A significant focus is placed on food security and environmental sustainability, covering climate-smart agriculture, water management, agroforestry, organic farming, permaculture, climate-resilient crops, regenerative agriculture, and the integration of economic, social, and environmental considerations. The book further examines nutritional transitions, dietary changes, malnutrition, non-communicable diseases, and policy approaches for promoting healthier and more equitable food systems.

The volume also presents discussions on food-system governance, policies, laws, international commitments, implementation pathways, and case studies from Africa, Asia, and Latin America. Dr. Ajay Singh has over 12 years of teaching and research experience in the field of Food Science and Technology. He has published approximately 50 research papers and more than 35 book chapters with internationally reputed publishing houses. He has also authored or edited nine books, including seven published by CRC Press, one by NIPA, and Objective Food Science, published by Brillion Publishers.

Dr. Singh has delivered invited talks and conducted workshops at various national and international forums. He serves as a reviewer for numerous international journals published by Springer, Elsevier, Wiley, and Taylor & Francis. He is also an Editorial Board Member of the Journal of Food Processing and Preservation and the Journal of Food Biochemistry, both published by Wiley. In addition, he has served as a Guest Issue Editor for several SCI-, Scopus-, and PubMed-indexed journals.

His teaching and research interests include composite flour and blended product development, as well as the optimization of gluten-free baked products.

Dr. Sheetal Thakur is working as an Associate Professor at the University Institute of Biotechnology (UIBT), University Centre for Research & Development, Chandigarh University, Punjab, India. She holds a Ph.D. in Food Technology from Guru Nanak Dev University, Amritsar, and has over 12 years of teaching and research experience.

Her research interests include cereal starches and proteins, industrial-scale dry milling, extrusion cooking, and new product development. She has also gained valuable industrial experience as a Senior Manager in Quality Control at a nutraceutical products manufacturing company. She is certified as an ISO/FSSC 22000 Food Safety Lead Auditor and has experience conducting audits in the food industry.

Dr. Thakur has published 28 research and review articles in reputed international journals and contributed 12 book chapters to publications by globally recognized publishing houses. She has also undertaken consultancy assignments involving troubleshooting and technical solutions for food industries. She serves as a reviewer for several reputed international journals published by Wiley, Springer, and Elsevier. She has presented her research and academic expertise through invited talks and guest lectures at national and international seminars, workshops, and conferences.
