Introduction

The food processing sector is highly fragmented industry, it widely comprises of the following sub-segments: fruits and vegetables, milk and milk products, beer and alcoholic beverages, meat and poultry, marine products, grain processing, packaged or convenience food and packaged drinks. A huge number of entrepreneurs in this industry are small in terms of their production and operations, and are largely concentrated in the unorganized segment. This segment accounts for more than 70% of the output in terms of volume and 50% in terms of value. Though the organized sector seems comparatively small, it is growing at a much faster pace.

The food processing industry can be classified into three categories: organized (25%), small scale (33%) and unorganized (42%) (Source: FAIDA/ Minstry of Food Processing Industries). The share of food processing in total manufacturing is only 9% in India.

Several products of fruits and vegetables are prepared on commercial and home scale. Products development from fruits and vegetables is the best way to utilize excess produces and save them from post harvest losses..

Value Addition

This is the process of improving the value of a commodity through processing by changing its form, increasing its shelf life or better presentation like packaging. Value addition can be done through the ways.

Annual plants complete their life cycle within the space of one year are called annuals. They have multipurpose uses like as cut flowers, a wealth of bloom through out the summer and early autumn months; as component in herbaceous border, to make colour scheme, for window boxes and porches, as pot plants in green house or conservatory, for edging, for drying and herbal medicines.

Aquatic plants are essential to maintain water balance. They also keep out the dreaded algal bloom. Aquatic plants absorb the minerals and carbon dioxide in the water. Pond plants are classified into four groups: oxygenators, marginals, floaters and aquatic. Oxygenators such as buttercup and water violet supply lots of oxygen in the water. Marginals are ornamental pond plants and planted in pots or baskets in the edge of the ponds to provide space for fishes or frogs, e.g., Primula. Floaters like water hyacinth help in keeping algae at bay and also provide enough cover for tadpoles or small fish.

Bulbous plants are herbaceous perennial or biennial ornamental plants which produce fleshy storage organs including true bulbs, corms, tubers, rhizomes and tuberous roots. These underground organs have capacity to store moisture and nutrients are utilized by bulbous plants to survive winter or other adverse conditions such as summer drought and heat in a dormant state.

Cacti

Cacti belong to the family Cactaceae comprising of 130 genera and 2000 species and bear a complex organ, a cushion like structure spirally arranged over the stem called ‘areoles’ from which spines, hairs, flowers and shoots develop. In tribe, Pereskieae, the plants are leafy bushes or shrubby and characterized by areoles on the stem and by the typical flower borne in clusters, e.g. Maihuenia, Pereskia and Rhodocactus.

Rose
Rose is a perennial erect shrub, climber or trailing plant  belonging to the genus Rosa within the  family Rosaceae. The plants bear large and showy flowers of white, yellow, red, pink, orange and various shades. Most of the species are native to Asia.

Valuable Genetic Resources

Shrubs are group of plants having woody stems and multi-branching from the base of the plant. These plants are useful to build up the framework of the planting scheme for screens, ground covers, flowers and hedges. They vary in blooming time, colour, size, growth habit, fragrance as well as situations.

Herbaceous perennial flowers complete their life cycle in more than a year and usually bloom during a specific time period every year during the growing season. These flowers are hardy and herbaceous. They are popular in their dried form for beautiful and exotic dried flower arrangements. Besides, perennials are used as ground covers, mixed with annuals, grown as potted plants and used as accents or specimen plants. Some important perennial flowers are Baby’s Breath, Bells of Ireland, Blue Globe Thistle, Carnation Flowers, Daisy Flowers, Flax, Hibiscus, Hollyhock, Iris, Ladys Mantle,Larkspur, Lavender, Lily Flower, Monkshood, Pearl Everlasting, Rose Flowers, Statice, Sunflower, Yarrow.

Foliage or house plants are mostly those with attractive foliages or flowers and are able to survive and grow under indoor conditions. They are mostly used for interior decoration or interior plantscaping. Foliage plants of world’s importance include Aglaonema, Dieffenbachia, Dracena, Epidendrum, Ficus, Peperomia, Philodendron, Sansevieria, Syngonium, Schfflera, ferns, Anthurium, Codiaeum. Florida shares more than 55% in foliage industry.

India is bestowed with varied agroclimate ranging from mild tropical zones to alpine zones and congenial for several types of ornamental plants in different seasons. Worldwide China and India have large total areas under flower cultivation. Among top ten cut flowers, rose ranks the first position followed by spray chrysanthemum, tulip, lily, gerbera, cymbidium, freesia, chrysanthemum, anthurium, alstroemeria and carnation. In view of rapid changing global competition, diversification into lesser known potential new ornamental plants play key role in fetching premium prices. Most of the potential exotic ornamentals plants have been introduced from Australia, South Africa, Israel, New Zealand and Eastern USA. There are about more than 60 types of new ornamentals reported to be hold potential for commercial importance. All these newly introduced ornamental plants require the following stages of research and development.

Foodgrains are a fine example of diversity of nature with many varieties and varied features. They are storable food commodities and lend themselves to numerous processing manipulations. Nutritionally foodgrains are rich source of almost all known nutrients and several phyto-chemicals. The increasing incidence of metabolic diseases are attributed to unbalanced energy rich diets lacking in fiber and protective bioactive compounds such as micronutrients and phyto-chemicals (Prakash, 2013). Cereals along with pulse combinations constitute an important part of human diet in many parts of the world because of easy availability, low cost, long shelf life and nutritional balance. During recent past, India has made significant progress in improving the food security of its masses. The green revolution of 60’s helped the country in achieving the food security by improving the availability and access components (Kaul et al., 2016). However, surplus quantity of food produced is not uniformly distributed and the quality component is not addressed properly which has a direct impact on nutrition. In spite of surplus production of foodgrains still malnutrition persists. However, it can suitably be overcome by combining cereals with good quality pulses and other value addition techniques which will go long way in solving the problem of malnutrition. Even though country is producing large quantity of coarse grains particularly maize but its utilization for direct consumption is very low which is mainly due to poor quality of protein. Although maize contains higher proportion of protein (10-12 %), its quality is poor as compared to that of protein in rice due to presence of high concentration of alcohol soluble protein fraction ‘prolamine’ also known as ‘Zein’ in the endosperm. Zein is very low in some essential amino acids, mainly lysine and tryptophan which contribute to more than 50% of the total protein. On the other hand, very high amount of leucine and imbalanced proportion of isoleucine contribute to poor quality of protein in normal maize. To overcome such deficiencies, scientists developed Quality Protein Maize (QPM) where the quality of protein is not only higher than the common maize, but also significantly higher than that of other cereal grains. In the recent past QPM has got special distinction among the cereals due to presence of high amount of essential amino acids like lysine and tryptophan. QPM can be utilized for diversified purposes in food and nutritional security as infant food, health food, convenience food, specialty food and emergency ration. In India maize is consumed mainly in the form of boiled corn or roasted as pop corn. In order to increase the proportion of maize for direct consumption, several traditional food-processing and preparation methods can be used at household level to enhance the bioavailability of micronutrients in maize based diets. These methods include alkali cooking, thermal processing, mechanical processing, soaking, germination/ malting and fermentation. In countries like Central America and Africa, it is converted into food products by grinding, alkali processing, boiling, cooking and fermentation (Srilakshmi, 2008).

• Aonla has laxative properties and therefore, useful in the treatment of constipation and piles.

• It also has antibacterial properties and helps in preventing infections and healing ulcers.

• It also helps in preventing skin infections.

• Aonla has cell rejuvenating properties and therefore, used in maintaining good health of skin and hair.

• Aonla helps to keep the hair glossy and shining.

Value addition refers to the process of increasing the economic value of a product, service, or commodity through various means, such as: Processing: Transforming raw materials into a more refined or finished product.
Enhancement: Improving the quality, appearance, or functionality of a product.
Differentiation: Creating unique features, branding, or packaging to distinguish a product from others.
Innovation: Introducing new or improved products, services, or processes. Value addition in medicinal and aromatic plants (MAPs) is essential to enhance their economic value, quality, and marketability. Here are key reasons why value addition is necessary:
Enhanced economic value
Value addition increases the economic value of MAPs, benefiting farmers and stakeholders. Primary processing and value addition are crucial in this regard. For instance, drying, cleaning, grading, and packaging are essential steps in adding value to MAPs.
Improved quality and shelf life Value addition helps preserve the bioactive compounds and aroma of MAPs, extending their shelf life. Techniques such as drying, extraction, and storage in airtight containers are vital in maintaining the quality of MAPs.

1. Introduction

Medicinal plants are well known for their secondary metabolites which are alternatively called as active principles responsible for curing of diseases and disorders. India is a biodiversity rich country belongs within 12 mega diversity zones of the world and possesses four biodiversity hot spots, 8 phyto-geographic regions and 10 vegetation zones (Khandekar and Srivastava, 2014). This subcontinent holds 47000 different species of plants out of which 8000 plants are medicinal in nature (Hamilton, 2004, Owolabi et al., 2007). High rate of endemism and 426 habitats for specific species are the unique resource of the country (BSI, 2009; Khandekar and Srivastava, 2014). Still majority of the herbal raw materials are wildcrafted and hence habitat destruction and wildcrafting pose a serious problem to the natural population particularly where roots are the targeted plant part as the percentage of root yielding medicinal plants are higher in the subcontinent. Since these plants are purely industrial and not having alternative uses the commercial production is not flourishing at a higher pace. Still the production of medicinal and aromatic plants in India has reached 1031000 tonnes from 634000 hectares.

In the post-CBD regime with global developments in aspects of Plant Genetic Resources and Intellectual Property Rights, the outlook towards these lesser exploited species has been changed to bioprospecting from collection and documentation.Here lies the importance of value addition in medicinal plants. Value addition means a change of state of the produce which will give a manifold return than the additional investment. Value-added products can be obtained through processing of raw herb or crude drug which will improve its look and also increase its quality, longevity, efficacy and obviously the return.

In monetary terms, value-added’ per unit of the product is the margin between its selling price and cost of production. However, in the dairy and food industry, value addition refers to, extra, features of a product that are beyond the expectations of a consumer at little or no extra cost. In this context, the addition of value to milk can involve monetary value added to a liter of milk by turning it into milk products, enhancing the convenience of quality, shelf life, or health characteristics using processing and packaging interventions.

4.1. Conversion of Milk into Conventional Products

It is an age-old tradition to add value to milk by processing it into milk products. The primary aim was to increase the shelf life of milk that would otherwise be highly perishable. With inadequate facilities to preserve liquid milk fresh in the rural areas’ conversion of milk into a variety of milk products would be an ideal option to effectively preserve the huge quantities of milk procured during the flush season’ In the processing of milk products such as cream, butter, cheese and ghee, by-products such as skim milk, buttermilk, whey, and ghee residue are obtained’ Many of the dairy plants, particularly in India’ are usually confronted with the problem of by-products utilization, especially that of whey and ghee residue in an economical manner. Membrane separation processes have presented new possibilities for the production of newer intermediate products from dairy by-products that can be used for value addition in dairy and food industries.

Introduction

Mushrooms are fleshy spore-bearing fruiting bodies of fungi, produced above ground on soil or on their food sources. Total number of useful fungi having edible and medicinal values is over 2,300 species. Like green plants, they do not contain chlorophyll and as a result cannot manufacture their own food. In this respect, they are like animals because; they feed themselves by digesting other organic matter. They are a large heterogeneous group having various shapes, size, appearance and edibility.

The use of mushrooms as food is very old. People harvested mushrooms from the wild for thousands of years for food and medicine. The Egyptians regarded mushrooms as food for pharaohs. The Greeks and Romans described them as food for God and served only on festive occasions. The first professional growers of mushrooms were the Chinese. China is the major producer and consumer of both edible and medicinal mushrooms. As early as 1313, a document was published which described the cultivation method for Shiitake on wood logs. Even older is the cultivation of the wood ear mushroom (Auricularia spp) of which sources indicates that it was cultivated from the year 600 A.D. onwards. The white button mushroom, Agaricus bisporus, was domesticated in France.

4.1. Coconut

• Coconut water is a refreshing drinks which also hygienic and nutritive.

• White flesh is a calorie rich extensively used for cookery in South India.

• From grated wet coconut kernel, good quality oil as well as protein and carbohydrate can be extracted to prepare coconut honey.

• Undesirable flavour changes in desiccated coconut are due to oxidative rancidity of the oil.

• Residual cake after the oil extraction is used as cattle food.

• Dried coconut meat is known as copra and is the source of coconut oil, which is used in enormous quantities for making fats for baking and confectionery.

• An important product used in the chocolate and confectionery industry is desiccated coconut.

• Nut is removed from hard shell and thin brown rind pared off.

Aerides

Aerides consists of more than 60 species. These are monopodial epiphytic orchids grown on trunks or branches of trees.  The stems are round, leafy and branched with aerial roots. The strap leaves are thick, leathery and bilobed. The inflorescence is auxillary and drooping. The flowers are many and 2cm in diameter closely set on the inflorescence and generally fragrant.

• Spices are usually dried roots, barks and seeds used whole or crushed, powdered.

• Spices add a glorious touch to food with its flavour and fragrance.

• Spices add flavour, colour to food and make the food palatable.

• Stimulates salivation and acid secretion of digestive enzymes like amylase.

• Has anti-inflammatory, antibacterial and antioxidant properties.

• Reduces cholesterol levels useful in preventing heart diseases.

• Kerala is considered as the land of spices.

3.1. Different types of spices and their use

• All spice or Pimento

? A small berry, size of the pea dried to a dark brown colour.

? Flavouring component is a volatile oil present at 3 -4% levels containing eugenol and other closely related phenols.
