12.1 Introduction

French bean (Phaseolus vulgaris L.) is one of the most important legume vegetables grown for its tender green pods for fresh consumption, processing and dry seeds. The pods are slender, 10-25 cm long, straight or slightly curved with prominent beak. Seeds are kidney shaped, elongated and white, red, purple or blackish in colour or mottled. The vegetable is in great demand in cities and is grown both commercially and in home gardens. Its major area is confined to hills, where it is grown for green pods. Punjab, Jammu and Kashmir, Gujarat, Karnataka, Tamil Nadu, Uttar Pradesh and Himachal Pradesh are the main states where it is being cultivated on large scale. Dry bean seeds are an excellent source of cheap protein and many cultivars contain 22-23 % protein. Hundred grams of edible fresh pods contain 91.4 % water, 1.7 % protein, 0.1 % fat, 0.5 % mineral matters, 4.5 % carbohydrates, 50 mg Ca, 28 mg P and 1.7 mg Fe. Its 100 g dry seeds contain 9.6 % water, 24.9 % protein, 0.8 % fat, 3.2 % mineral matters, 60.1 % carbohydrates, 60 mg Ca, 433 mg P and 2.4 mg Fe. In India, it is mostly grown for fresh consumption, while in USA it is grown for processing in large quantities. Dried beans are rich in protein and closely compared with meat. Phaseolus oborigineus is the progenitor of French bean. They are capable of utilizing atmospheric nitrogen with the aid of bacteria found in the nodules on the roots of the plants. Four cultivated species are seen under the genus Phaseolus, i.e., Phaseolus vulgaris—common red kidney bean, Phaseolus coccineus—scarlet runner bean, Phaseolus lanatus— Lima bean, Phaseolus acutifolius var. latifolius— Moth bean or Tapery bean. All the species are self-pollinated except lima bean which is often cross-pollinated and Phaseolus coccineus is generally cross-pollinated and long day plant.

11.1 Introduction

The term ‘Dolichos’ derived from Greek language means long pod and ‘lablab’, an Arabic term, means production of sound by dried seeds in the pods. In India, it is grown all over the country but compact large acreage for commercial production is uncommon. It is grown for whole pod. Fresh seeds and dry seeds are used as pulse grain. It is used as pod vegetable, feed and green manure crop. It is very popular in villages as well as cities where less area is available for cultivation. The young tender leaves are used in salads and the relatively old leaves are cooked as potherb like spinach. Its fresh green pods contain 86% moisture, 3.8% protein, 6.7% carbohydrate, 0.7% fat, 0.9% mineral matter, Vitamin A 312 IU. It is good source of Vitamin B, Vitamin C, proteins, minerals and dietary fibres. Trypsin inhibitor and several anti-nutritional factors such as tannins and phytates are present in mature and dark coloured seeds. On heating it is broken down into toxic cyanogenic glucoside which is soluble in boiling water. Therefore, it is necessary to boil the mature seeds in water before consumption. Sem is of two types.(A) Dolichos purpureus var. typicus (Graden Type) is with soft, edible pod wall having less fibre. (B) Dolichos purpureus var. lignosus(Field bean) that is grown for fresh dry seed as pulse, pod wall has high fibre content and has characteristic aroma. Hyacinth bean is a perennial herbaceous plant often grown as an annual and pole types are photosensitive.

10.1 Introduction

Cowpea is a typical warm season crop adapted to tropics. It is grown both for its tender pod and dry seed that is used as pulse for culinary purposes. The pods are rich in protein, vitamin B and minerals. It is also used as a fodder and green manure crop. On dry weight basis the cowpea seeds contain 23.4 % protein, 1.8 % fat and 60.3 % carbohydrates. Most probable progenitor of cowpea is Vigna unguiculata var mensensis. It is grown as a catch crop that is drought tolerant and sensitive to water logging. Being a legume crop, cow pea fits well in different inter-cropping systems. It is mainly of two types. Asparagus bean/yard long bean/snake bean (Vigna sesquipedalis) has 30-90 cm long fleshy pod with elongated kidney shaped 8-12 mm long seeds. It is late maturing variety. While catjang bean (Vigna catjang) has 7-13 cm long pods with 5-6 mm kidney shaped seeds. Pulse type of cowpea is Vigna uniguiculata var radiate and dual-purpose cowpea is Vigna uniguiculata var cylindrica.

9.1 Introduction

Cluster bean is grown in India to a lesser extent than other beans. It is a commercial crop of arid and semi-arid regions. It is grown for its green pods that are used as vegetable and dry seeds. It is also grown as forage and green manure crop. Among leguminous crops it is comparatively hardier, drought resistant and cultivated on a large scale as a forage crop in dry regions because of its deep tap root system which enables it to recover from water stress. Some of the cultivars are used for extraction of gum called as guargum. The gum obtained from this crop is like a mucilaginous substance called galactomannan that is used in various industries particularly textiles, cosmetics, explosives and paper. Due to its colloidal nature, the gum acts as a stabilizer and thickener in food products,viz., ice cream, bakery mixes and salad dressings. The seeds of clusterbean contain about 30-33% gum in the endosperm. The gum in the seeds are galactomannan polysaccharides. The discovery of the galactomannan gum in the endosperm during 1948, led to its importance as an industrial crop. Today it is one of the significant foreign exchange earners of the country. Fresh pods contain 82.5% water, 9.9% carbohydrate, 3.7% protein, 0.2% fat, 2.3% fibre and 1.4% mineral matter. Cyamopsis senegalensis is the ancestor of guar. The largest growing state is Rajasthan (82%). Young plants of cluster bean contain hydrocyanic acid which causes toxicity to animals. It is an amide (asparagine and glutamine) producing legumes.

8.1 Introduction

Amaranth is one of the oldest food crops in the world, with evidence of its cultivation reaching well back to 6700 BC. The genus Amaranthus consists of nearly about 60 species, which includes leafy vegetables, vegetables for grains, ornamental plants as well as weeds. The word amaranth has actually been derived from the Greek word amarantos, which means unwithering and the people who used it symbolize immortality. The Hindi term for amaranth, Ramdana, means God’s own grain. Amaranthus tricolor L. is the most common species grown as leafy vegetable during summer and rainy season in India but it can be grown throughout the year. It fits well in crop rotations because of its very short duration and large yield of edible matter per unit area. The estimation of the extent of its cultivation is not available. Green or leafy types are usually grown in kitchen and market garden. Amaranth is more widely used as a potherb. The grain Amaranthus species are popular in the high lands of tropical and sub-tropical America. It is gaining importance in the Indian plains also, particularly in Gujarat and Maharashtra. Grain types are usually grown as mixed crops along with cereals, pulses and vegetables.

6.1 Introduction

Capsicum is mostly consumed raw in green mature forms unlike in Europe and US where they are consumed in red ripe form in salads, cooked, mixed and stuffed vegetables. It is known as bell pepper because of its fruit shape. The fruits of capsicum are non-pungent, so popularly known as sweet pepper; but some cultivars are slightly pungent. Capsicums are grown throughout the Old world and New world as a commercial crop mainly in mid-hill regions or protected structures. Its cultivation is restricted to cooler regions of the world. In Spain, it is referred to as ‘pimientos’ due its red colour and sweet taste. Fruits are rich in vitamins C and D (beneficial to the vascular system), as well as vitamins A, B1 , and B2 . It has four different colours such as green, red, yellow and purple. The oleoresin extracted from bell pepper is of better quality than that extracted from Chilli.

5.1 Introduction

Chilli is a tropical vegetable crop but considered as an important spice crop of India. Chilli is mainly used in culinary purpose for adding flavour, colour and pungency. It is consumed both in mature and immature stage. In immature form it is valued for pungency and in ripe dried form it is valued both for pungency and colour. Dry chilli powdered or ground into a paste and even green chillies are used for curries, sambars, rasam and other savory dishes to impart pungency, colour and flavour to food items. It is widely used in the manufacture of curry powder, curry paste and all kinds of pickles and preparing sauce, soups, salads etc. In food and beverage industries chilli is being used in the form of oleoresin which permits better distribution of colour, flavour in food. Capsaicin, the pungent principle, is present in cores or septa walls and placenta. It is used in the preparation of balms, whereas the colour extracts (Capsanthin/carotenoid pigments) find use as colour additives in food industry, poultry and prawn feed industry. Green chillies are rich in Rutin which has pharmaceutical use and known as Vitamin P. Oleoresin present in chilli permits better distribution of colour and flavour in food as compared to chilli powder due to cleanliness and uniform flavour. Oleoresin is used in preparation of processed products and also in a number of pharmaceutical formulations. A non-conventional use of chilli is for self-defence sprays of capsicum oleoresin at ultra-high emission rate which temporarily immobilizes the attacker. Highest pungent chilli of the world is Bhoot Jolokia/Naga King chilli (Capsicum chinensis) in NE India. Hotness of Naga king Chilli is 10,01,304 SHU (Scovonelle Heat Unit). At present chillies are grown in almost all states of the country. The major chilli growing states are Andhra Pradesh, Karnataka, Maharashtra, Odisha, Tamil Nadu, Madhya Pradesh, West Bengal and Rajasthan. Within a span of over four centuries, it has spread to an area of around 0.8 million ha. The area and production keeps varying depending on price fluctuations and the weather conditions. Area under chilli cultivation in India is 0.831 million ha with a production 1.87 million tonnes of dry chilli. Andhra Pradesh has been leading both in area and production contributing on average of 25 per cent of the total area and over 40 to 50 per cent of the total production. Chillies have adapted very well to the Indian condition so that, India is considered as secondary centre of origin.

4.1 Introduction

It is an annual crop cultivated all over India, Bangladesh, Pakistan, China, Japan, South East Asia and Philippines. The fruits are available practically throughout the year. Brinjal fruits are a good source of calcium, phosphorus, iron and vitamins particularly ‘B’ group. A 100 g of edible fruit contains 91.5g of water, 6.4 g of carbohydrates, 1.3g of protein, 0.3g of fat and 0.5g of mineral matters. Its green leaves are the main source of vitamin C (38-104.7mg/100g). Dark purple brinjal has more vitamin C than those with white skin. Bitterness in brinjal is due to presence of glycoalkaloid solasodine. Generally, high amount of glycoalkaloids (20mg/100g) in the fruits produce a bitter taste and off flavour. Brinjal is reported to stimulate the intrapeptic metabolism of blood cholesterol and has marked drop in blood cholesterol level. The de-cholestrolising action is attributed due to the presence of poly-unsaturated fatty acids, PUFA (linoleic and linolenic) which are present in flesh and seeds of fruit in higher amount (65.1%). The presence of Mg and K salts also helps in de-cholestrolising action. Dry fruit is reported to contain goitrogenic principles. Aqueous extracts of fruit inhibit choline esterase activity of human plasma. Brinjal has got much potential as raw material in pickle making and dehydration industries. It is supposed to contain certain medicinal properties and white brinjal is said to be good for diabetic patients. The fruits are regarded as a cure for toothache. It is also an excellent remedy for those who are suffering from liver complaints. Cu content and polyphenol oxidase activity are highest in purple colour fruits and lowest in white fruit. Fe and catalase activity are highest in green fruited cultivars and lowest in white fruited cultivars. White fruited cultivars contain twice as much crude fibre as the purple and green fruited cultivars. Solanum ferox is yellow fruited type and is very popular in southern Europe, France and Italy and USA. Vitamin C content of brinjal is affected by canning. Toasting of fruits raises the nicotinic acid at the expense of trigonellin which is present in it and 66-69% of it is converted into nicotinic acid during toasting.

3.1 Introduction

Tomato is one of the most versatile vegetable with wide usage not only in Indian culinary but also in world cuisines. Despite botanically being a fruit, it is generally eaten and prepared like a vegetable. Tomato is producing a very good source of income to small and marginal farmers and provides nutrition to the growing population. Sometimes, it is called poor man’s orange in India and Love of Apple in England. Tomato is one of the most important “protective foods” because of its special nutritive value. The100 g of edible portion of tomato contains 94.1 g of water,2.5 g of total sugar, 1.0 g of protein, 0.3 g of fat, 4.0 g of carbohydrates, 0.6 g of fibre, vitamin A (1100 I.U), vitamin B (0.20 mg), vitamin C (23 mg), malic acid (150 mg), citric acid (390 mg), oxalic acid (3.5 mg), potassium (268 mg), and phosphorus (27 mg). Tomato is a rich source of minerals, vitamins and organic acid. Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. It is used for treating chronic dyspepsia, bronchitis, asthma and also used as a blood purifier. Tomato fruits contain 20-50 mg of lycopene/100 g fruit. Tomatine is a steroidal glycoalkaloid present in tomato. Tomatine content is higher in leaves and flowers than fruits. Tomatine content is 300 mg/100 g in small hard tomato fruits whereas in large green tomato it is 150mg/100 g. There are various types of flavouring compounds found in fruits, which enrich the taste;so, several processed items like paste, puree, syrup, juice, ketchup, drinks etc are prepared on large scale. Tomato fruit aroma is due to sulfonium. Tomato acidity is due to citric acid and pH of the tomato juice is 4.5.Tomato is very good appetizer and its soup is said to be a good remedy for patients suffering from constipation. Three flesh colours are found in tomato, namely, red (lycopene pigment), yellow (carotenoid) and tangerine (prolycopene).Tomato seed oil (24%) is used for manufacture of margarine. About 33% of total tomato growing area is covered by F1 hybrids which is highest among the vegetables grown in India. A book entitled Tomato was written by Dr. G. Kallo in 1986.

2.1 Introduction

Vegetables are grown and consumed throughout the country either on small or commercial scale. Various terms have been used for vegetable gardening, based on the objectives for which they are grown and can be classified into various types depending on the acreage cultivated, method of cultivation and purpose of vegetable production. Based upon these facts, vegetable cultivation is divided into the following types of gardens:

1. Home or Kitchen Gardening: The purpose of this gardening is to supply the varieties of vegetables for family use.

2. Commercial Vegetable Gardening: This is the method of growing vegetables on large scale to earn profit and is further divided into seven types:

1.1 Introduction

Horticulture is defined as “The science and art of growing vegetables, fruits, flowers, ornamental plants and landscaping of gardens and surroundings in small and commer cial gardens”. The word ‘horticulture’ has been derived from Latin language and con sists of two parts, viz., ‘hortus’ means garden and ‘cultura’ means cultivation. Thus, the word ‘horticulture’ means garden cultivation. Horticulture basically deals with Pomology, Olericulture, and Floriculture and Landscaping. Horticulture is gaining im portance as it gives more returns per unit area and also gives nutritious food to human beings thereby improves quality of life and enhances the aesthetic beauty of nature. Vegetable growing is one of the major branches of horticulture with respect to value of the products.

Role-play is a product of ‘play’, ‘games’ and ‘simulation’ (Gabrielle McSharry, 2000). In science education, role-play may be seen as an interaction between these three components – either in combination or by themselves – and students who perform such activities results in learning outcome. In the context of social studies, role-play is used to learn the issues and decisions of the past and how things might have been different in local community in a broader setting. Aside from knowledge acquisition, preparing and conducting a role-play activity strengthens students’ knowledge, acquisition skills, their creativity, their values clarification skills and a variety of interpersonal skills identified in the curriculum outcomes. As an effective instructional teaching strategy, role-playing emphasizes the social nature of learning and sees cooperative behaviour as stimulating students both socially and intellectually.

Data Collection: An Academic Perspective

Data collection constitutes the systematic gathering and measurement of information pertinent to variables of interest. This process facilitates the answering of research inquiries, hypothesis testing, and outcome evaluation. It is a fundamental component across all academic disciplines, encompassing physical and social sciences, humanities, business studies, and more. While methodologies may diverge among fields, the fundamental objective remains constant: ensuring the precise and ethical acquisition of data. The overarching aim of data collection is to acquire high-quality evidence that underpins robust data analysis, thereby enabling the construction of compelling and credible research outcomes.

Participatory Rural Appraisal (PRA) stands as a methodological framework comprising participatory and visually oriented techniques for assessing communal and group resources, discerning and prioritizing challenges, and evaluating strategies to tackle them. It serves as a research and planning approach wherein local communities, with or without external guidance, engage in a comprehensive examination of issues pertinent to their populace. The process involves identifying problems, weighing various solutions, and formulating a Community Action Plan to address the identified concerns. Central to PRA is the inclusion of diverse community perspectives in the analysis and empowering the community to lead the evaluation of its circumstances and the search for remedies. While external actors may partake as facilitators or providers of technical expertise, the autonomy of the community in driving the process is paramount.

Brainstorming is a group creativity technique by which efforts are made to find a conclusion for a specific problem by gathering a list of ideas spontaneously contributed by its members. The term was popularized by Alex Faickney Osborn in the 1953 book Applied Imagination. Osborn claimed that brainstorming was more effective than individuals working alone in generating ideas, although more recent research has questioned this conclusion. Today, the term is used as a catch all for all group ideation sessions.

Origin

Advertising executive Alex F. Osborn began developing methods for creative problem solving in 1939. He was frustrated by employees’ inability to develop creative ideas individually for ad campaigns. In response, he began hosting group-thinking sessions and discovered a significant improvement in the quality and quantity of ideas produced by employees.

Teaching

Extension teaching denotes a structured process aimed at fostering the learning experience. This process encompasses the facilitation of activities, provision of materials, and offering guidance necessary for the learner. In essence, it orchestrates scenarios wherein the subjects to be assimilated are brought to the learners’ attention, fostering their interest, engendering desire, instilling conviction, prompting action, and ensuring satisfaction.

Characteristics of Teaching

Social psychology, as previously elucidated, endeavors to delineate the nature of social behavior. Social behavior encompasses four fundamental types of interactions

i) When individuals encounter one another, mutual reactions occur. Each individual influences the other, and reciprocally, they are influenced by each other’s presence.

ii) Individuals may elicit responses from groups, such as when an extension worker interacts with a gathering of farmers.

iii) Conversely, groups collectively respond to individual members, as exemplified by a group’s reaction to its leader during a meeting. iv) Interactions extend to intergroup dynamics, where one group of individuals reacts to another group.

This paper examines the objectives of leadership training and the methods by which these objectives can be achieved.

Meaning of Training

The term ‘training’ refers to a structured process designed to improve an individual’s ability to fulfill their responsibilities. It involves imparting knowledge, developing skills, and shaping attitudes to enhance professional competence. For potential leaders identified through various selection methods, training serves as a means to cultivate essential leadership traits that may be lacking initially.

The concept of leadership revolves around the figure of a person who wields influence over a group of individuals. Such an individual often emerges through their ability to initiate and guide social behavior, directing the efforts of others, organizing tasks, or exerting control, often leveraging their prestige, power, or positional authority. In various social contexts, a leader is recognized as someone whose ideas and actions significantly impact the thoughts and behaviors of those around them. This recognition can occur spontaneously or through deliberate selection, where certain individuals within a society operate within groups to guide and influence members towards specific actions.

Leadership, therefore, is construed as a dynamic process wherein individuals endeavor to shape the behavior of others within a tangible scenario. One commonly accepted definition, posited by Rogers and Olmsted, characterizes leadership as the endeavor to persuade individuals to collaborate towards a goal perceived as beneficial by the collective. Another perspective, articulated by Hepple, frames leadership as the role and status held by one or more individuals within the organizational structure of a group. This status enables these individuals to facilitate the functioning of the group and fulfill its objectives, which often necessitate the cooperative efforts of its members. Thus, leadership emerges as a multifaceted phenomenon, encompassing both the actions of influential individuals and the structural dynamics within group organizations.

Social Control

Social control denotes the influence wielded by the public or society aimed at fostering the collective welfare of the group. It entails mechanisms that induce individuals to adhere to societal norms and moral standards, thereby guiding their behavior towards socially acceptable actions. The imperative role of social control lies in upholding societal stability, which is indispensable given the inherent variability of human nature and the pervasive impact of environmental factors.

Various scholars have offered insights into the concept of social control:

According to Mannheim, social control encompasses the array of methods employed by a society to shape human behavior, thereby preserving a predetermined social order.

Anderson defines organizations as structured human relationships wherein individuals purposefully associate in systematically arranged units to advance and achieve common purposes or interests not explicitly articulated within the institution. Each member assumes a formal status and role within this framework. Distinguishing an organization from an institution lies in its focused pursuit of narrowly defined objectives; it constitutes a collective of individuals organized to pursue specific aims. Conversely, an institution encompasses broader and more general objectives, constituting a set of socially endorsed procedures entailing patterned behavior, norms, and regulations. Organizations may function within institutions, thereby contributing to and facilitating the achievement of institutional objectives. The formation and structure of an organization evolve through the delineation of specialized activities, formulation of rules and regulations for operations, establishment of meeting schedules and locations, ultimately rendering the organization a clearly delineated entity with specific objectives, officers, and membership.

Social institutions encompass a cohesive array of norms that uphold fundamental societal values. It refers to a structured system of social relationships that encapsulates shared values and protocols, fulfilling specific societal requirements. According to Horton, it embodies common values and procedures, addressing the fundamental needs of a society. These institutions are formal cultural frameworks designed to satisfy essential social needs and establish organized patterns of human behavior in the execution of core societal functions

Social institutions emerge from societal interactions to address fundamental needs such as stability, law enforcement, and the delineation of authority and decision-making roles. Each organization operates within established sets of rules, traditions, and customs, collectively termed as institutions. These institutional frameworks consist of recognized procedures and norms that are accepted by society, regulating interactions and relationships between individuals and groups.

Values denote the subjective significance or preferences accorded to objects, concepts, or experiences within an individual’s cognitive framework. The concept of value encompasses entities or outcomes that are desired or selected by individuals. Social values, as expounded by Green (1964), represent enduring cognitive and affective constructs pertaining to objects, ideas, or individuals within a societal context. These values are often abstract in nature and may operate at a subconscious level, embodying implicit assumptions regarding what is deemed morally and socially significant. As articulated by Young (1959), social values encapsulate abstract and subconscious beliefs regarding notions of righteousness and importance within a communal framework.

Extension education serves as a catalyst for altering the behavioral complexities within rural communities. This behavioral shift is intricately intertwined with cultural determinants, thereby necessitating extension workers to possess a profound understanding of rural cultural dynamics. Culture, delineated as learned behavior organized into patterns and disseminated among society members, constitutes a foundational concept in sociology, elucidating the regularities observed in human actions. Unlike its colloquial interpretation, which often limits culture to refined expressions such as art and music, sociological discourse expands the scope to encompass the entirety of learned behaviors, attitudes, beliefs, and social norms characteristic of a specific group.

Social stratification refers to the hierarchical arrangement of individuals or groups within a society based on various factors such as wealth, power, education, and social status. It involves categorizing people into different layers or strata, each with its own level of privilege, opportunities, and restrictions.

Social stratification, as defined by Lundberg (1968), pertains to the categorization of a population into distinct layers, each characterized by relative homogeneity and marked differences in privileges, restrictions, rewards, and obligations. Cuber (1954) further elucidates this concept, describing social stratification as a pattern of superimposed categories of differential privilege. The movement of individuals or groups across different strata within society is termed social mobility. Social stratification manifests in various forms, with the caste system and class system being two major types. Societies exhibit stratification based on factors such as sex, age, and occupation.

A social group is commonly conceptualized as an entity comprising two or more individuals engaged in reciprocal communication, characterized by shared traits and possessing a collective sense of unity. Within the framework of the social identity tradition, researchers delineate groups as entities whose members self-identify as part of the collective. Social groups exhibit diversity in terms of size and typologies. For instance, an individual’s initial social interactions occur within the familial context, where interactions with immediate family members, notably the mother, serve as primary points of contact. Subsequently, as the individual progresses through developmental stages, engagement with peers and neighbors expands the social sphere, constituting another significant social group. Further social group affiliations emerge during formal education, as the individual integrates into student cohorts within educational institutions. Over time, the individual assumes diverse roles within broader societal contexts, contributing to the fabric of community and national citizenship. Society

Human societies are intricate networks of individuals engaged in continuous social interaction within a shared geographical or social space, typically under the governance of the same political authority and cultural norms. These societies are characterized by complex patterns of social relations, cultural practices, and institutional structures, collectively shaping the fabric of human existence. Social sciences often reveal underlying stratification and dominance patterns within these societies. Collaborative in nature, societies offer collective benefits that transcend individual gains, facilitating opportunities that would otherwise remain inaccessible. Within a society, subcultures may emerge, governed by their distinct norms and values, coexisting within the broader societal framework. Structurally, societies encompass economic social, industrial, and cultural infrastructures, comprising diverse individuals yet forming a cohesive entity. The term “society” traces its origins to the Latin word “societas,” signifying friendly or civil interaction among parties. It encompasses the entirety of humanity, acknowledging the interdependence and interactions among individuals.

The process of concentrating a fruit juice / pulp, vegetable juice, medicinal plant extracts or milk to a reasonably thick consistency is called concentration. Thus, concentration is a water removal process from the liquid food materials. The basic principle of concentration is boiling the liquid under partial vacuum at low temperature till desired concentration is reached. With respect to water removal, the concentration process is similar to dehydration. The food concentration is distinguished from drying on the basis of the finished product where the final product called concentrate is still liquid. In concentration process, only liquid food is used while in drying both liquid as well as solid food can be used. Fruit juice concentrates, milk concentrate are valuable semi-processed products for use in the production of value added products like fruit juice beverages and fruit juice powders. Since the water content of single strength fruit juices is very high (about 75-90%), concentration of fruit juices not only provides microbiological stability but also permits economy in packaging transportation, and distribution of the finished product due to reduction in bulk by weight and volume.

Food Business Regulatory System in India

In India Food Businesses are regulated by only One authority i.e. Food Safety and Standards Authority of India (FSSAI). This comes under the control of Ministry of Health and Family Welfare of the Govt. of India.

FSSAI – Food Safety and Standards Authority of India

The FSSAI or Food Safety and Standards Authority of India was incorporated under the Food Safety and Standards Act (FSSA) of 2006. It consolidated various acts & orders that were previously applicable and used to handle food related issues in different Ministries and Departments. The basic objective of formulating FSSAI has been to lay down science-based standards for items of food and to regulate their manufacture, storage, sale, distribution, and import to ensure the availability of adulteration-free and wholesome food for human consumption.

Citrus fruits are acidic, exotic fruits with juicy, bitter, fruit segments inside. Citrus fruits commonly originated in tropical and sub-tropical regions of the world. They have long been valued as part of a nutritious and tasty diet. The f lavours provided by citrus are among the most preferred in the world, and it is increasingly evident that citrus not only tastes good, but is also good for people. Citrus fruits have certain therapeutic properties such as antitumor, anti-inflammatory and anticancer, due to phytovitamins and nutrients present in them.

The production of fruit and vegetables has recently increased significantly and even surpassed the total grain production in the country due to increased awareness of consumer and positive government initiatives (Schieber et al., 2001; Sagar et al., 2018; Malenica and Bhat, 2020). But due to limited production and area, the importance of excess production during a particular season and waste management arises at highest priority level. Moreover, fruits and vegetables waste are a serious problem for environment as most of themare being disposed of as landfills or directly disposed off to water bodies such as rivers (Wadhwa and Bakshi, 2013). Fruits and vegetables are perishable in nature and rich source of nutrients and vitamins, which results in microbiological contamination (Coman et al., 2019; Bas-Bellver et al., 2020). Foods wastes are usually organic residues generated by the processing of raw agricultural materials into food and are made up of liquid (wastewater) and solids (Bas-Bellver et al., 2020). The wastewater results from the cleaning processes or in the form of excessive or polluted process water. Its dry material content is typically less than 5% by mass. It possibly also contains organic or inorganic cleaning agents or disinfectants. Solid food wastes with an organic origin have remarkably high water content (mostly about 80% by mass). They are usually characterized by a constant quality and purity due to the forgone processes. The fact that these substances are removed from the production process as undesirable ingredients makes them, wastes.

Increased awareness about the food safety and various adulterations or crises reported in food industries, the food quality and its safety has emerged as the most important features of the modern food processing and preservation. The important historical dynamics which raised the concerns of food safety were motivated by accidents related to food borne pathogens and chemical contamination during the food processing and distributions. Many times, the terms food quality and safety are interchanged however, there is a difference in terms of their perception by the consumers and manufactures. In past few years, the food safety has become the characteristic of food quality and has been regulated by various national and international agencies. The increased concerns about the safe, nutritious and high quality food has over the time forced the public authorities to engage the food industries to construct the quality management systems in order to improve the food safety and build the consumers believe and trust towards processed foods. Food quality is a broader concept which includes food health quality attributes along with parameters like sensory characteristics like taste, smell and convenience like food preparation (Röhr et al., 2005). The food qualities like nutritional, convenience and sensory are not requested by the public laws but are desired by the consumers. The management systems for the quality assurance have evolved over the time and now we have systems like HACCP. ISO 9000 and ISO 14000 in place which are well known quality management modules to ensure the elimination of food hazards. On a broader scale of trading food several technical agreements under WTO (world trade organization) have been made which provide equal opportunities to all countries to trade the goods however, it imposes the similar food quality standards across all the participatory members. The responsibility of food safety is directly connected with all the stakeholders of the food chain which include manufactures, processors, farmers, food handlers and finally the consumers. Food contaminations may be a result of poor manufacturing practices and poor storage and handling practices at any stage in the food chain. To ensure the safety compliances, national food regulatory models plays a significant role. The guidelines issued by FAO/WHO, 2003 are focused on the public organizations, as well as food control authority self-assessment to ensure highest food quality and its safety from farm to fork. The base of the assessment includes 6 factors viz. food inspection, food quality management, food safety, official food control laboratories, food legislation food and quality information, education and communication (Shukla et al., 2014).For effective implementation of the food safety and quality module the countries have developed various food laws and legal norms which states the principles to be followed for raw materials, their processing and distribution in order to achieve the consumer expectations as well as the hidden food safety concerns.

How one can differentiates between sensory science and sensory evaluation? Perhaps the simplest way would be to think of sensory science as the fundamental physiological and psychological underpinnings of sensory evaluation. It could include our basic understandings of the mechanisms of taste and odour, kinesthetic and the various techniques of scaling and statistical analysis, whereas, sensory evaluation could designate the application of this knowledge and the development of specific methods for the evaluation of the discriminative, descriptive and affective nature of products, in a problem-solving situation. When the quantitative descriptive analysis (QDA) methodology was f irst described, it represented a decade of experimentation and study of the issue that were perceived at the time to be impediments to solving “the problem of flavour characterization” (Stone et al., 1974). As noted by Pangborn (1964), new developments and knowledge about sensory evaluation were beginning to have a positive effect on its acceptance by industry, but much more needed to be done if it was to contribute in a meaningful way. Today, it is indisputable that flavour is an important attribute affecting consumer acceptance of food. “Flavour is taste plus odour”. The perception of taste is merely the detection of non-volative tastants by the tongue. On the other word, the perception of odour is the detection of odoriferous volatile aroma compounds by the olfactory nerves ending in the nose. The combination of all possible flavour stimuli we could encounter is as vast as the galaxy. However, most of the attempts to define these experiences have historically been over simplified.

Packaging is one of the most important processes to maintain the quality of food products for storage, transportation and end-use. The basic functions of packaging are considered as protection, containment, information and convenience. Food packaging was initially considered to increase the marketable life of the food in a container by protecting it from the influence of the environmental factors. Then it was expected to be informative, easy-to handle and disposal-friendly with increased functionality. Current innovations of food packaging technology are geared to ensure one/ all of these properties along with better protection, more efficient quality preservation and enhanced safety of the packaged food. Innovative packaging technologiesalso prevent the rate of quality deterioration and facilitate easy handling of the produce during distribution and marketing. During distribution, the quality of the food product can deteriorate biologically and chemically as well as physically. Innovative packaging technologies are the most important and challenging technologies to overcome these limitations.These technologies require specific knowledge and appropriate training and understanding for rationally selecting the most suitable packaging for each product and intended use. Innovative packaging of foods includes active packaging, smart packaging, on-the-go packaging, intelligent packaging etc. which have been briefly discussed in this manuscript.

Color is an important characteristic of food. Based on the color of the food, f irst impressions are made: Is the fruit immature, ripe, or overripe? Is the toast burnt? Is the food fresh? Based on these first impressions, a judgment is made whether the food is safe to eat or not and whether it can be expected to taste good or not. Since color is closely associated with expectations, the addition of color to food is a way to fulfill these expectations. Color is added to food for one or more of the following reasons:

1. To replace color lost during processing,

2. To enhance color already present,

3. To minimize batch-to batch variations, and

4. To color otherwise uncolored food.

Fermentation is playing an important role in the human life and is evident from the fact that food can be both spoiled and made by fermentation. A wide range of the fermented food products are consumed by the consumers in their daily routine. It is one for the oldest and ancient method of food preservation. It may have been a mere accident when people first experienced the taste of fermented food. Fermentation became popular with the dawn of civilization because it not only preserved food but also gave it a variety of tastes, forms, and other sensory sensations. Fermentation, along with salting, cooking, smoking, and sun drying, is one of the earliest ancient traditions developed by cultures all around the world to extend the possible storage time of foods. Slowly, people have realized the nutritional and therapeutic value of fermented foods and drinks, and this has made fermented foods even more popular. Bread, beer, wine, and cheese originated long before Christ. Although modern food technology has contributed to the present day high standard of quality and hygiene of fermented foods, the principles of the age-old processes have hardly changed. In industrialized societies, a variety of fermented foods are very popular with consumers because of their attractive flavor and their nutritional value. During food fermentations, the controlled action of selected micro-organisms is used to alter the texture of foods, preserve foods by production of acids or alcohol, or to produce subtle f lavours and aromas which increase the quality and value of raw materials. After drying, fermentation is the world’s oldest food preservation method.

The drying of fruits and vegetables during the season of abundance in order to preserve them for consumption during season of shortage is an ancient practice. Thus, drying is one of the oldest methods of preservation of the food commodities. It is practiced from ancient times and is a very common method of preservation in the tropical countries like India where conditions are much more favorable for sun drying. All micro-organisms need moisture to grow. So the removal of water in the food is brought down below a certain level at which they are unable to grow. Moisture content from food can be removed by different methods like sun drying (very oldest method and most popular), solar drying, cabinet drying, mechanical drying, tunnel drying, poly tunnel drying, adiabatic drying, spray drying, osmotic drying, fluidized bed drying etc. Grains are mostly dried in the sun. The moisture content of the grains can be reduced to a limit that is safer for their storage by sun drying. Many fruits and vegetables can also be dried by using sun energy. Some coastal areas of the countries fishes are also dried by exposing to the sun. After drying, sometimes the dried products are converted into powder. However, these powders are very hygroscopic and should be packed in airtight. Mango powder is prepared by this technique, but expensive and not popular in India. Nowadays many artificial methods have been developed for removal of the moisture. The relationship between the moisture content and temperature of air during process is referred as Psychrometric relation. An instrument used to measure the humidity (Relative humidity) of the atmosphere is known as Psychrometer (Hygrometer). The residual moisture in vegetable should not be more than 6-8% and in fruits it should be in the range of 10-20%. The dried fruit can be used as such or after soaking while dried vegetable are usually soaked in water overnight and then cooked. Vegetable are considered to be dry when they become brittle. There are generally two drying methods for foods like 1) Natural drying and 2) Artificial drying. The preservation / stability of the dehydrated products is conferred by the abstraction of water, so that the product is unable to support the microbial growth, its chemical forms of deterioration is inhibited and the drastic reduction in the weight / volume facilitate easier handling and marketing. Among dehydrated products, dehydrated onions have largest share of 45%. India is the third largest exporter of the onions in the world next to the Netherland and Spain. Besides this, India exports dehydrated bell pepper, garlic and mushrooms.

Drying is one of the oldest methods of preserving food. Drying and dehydration both can be defined as the process of removing moisture from the foods. It is a simultaneous heat and mass transfer process, wherein heating medium or internal heat generation helps in evaporation of free water molecules from the product. Drying means removal of moisture of food upto a predetermined level where as in dehydration, complete removal of moisture upto bone dry weight of food material. Dehydrated foods have less than 2.5 % moisture content (dry basis) where as dried foods have dry basis moisture content more than 2.5 %. Drying operation consumes energy from 0.38 to 0.63 GJ/ton of food grain. Removal of water from foods using thermal energy thus makes it an energy intensive process. Modes of heat Transfer in various Driers are given in Table 1.Developments in dryer and methods, dryer selection based on form of raw material and typical residence time for various dryer are are given in Table 2,3 and 4, respectively.

The health and wellness of human being is largely dictated by the consumption of nutritious foods. Understanding the role of foods in maintaining health and cure of diseases has its roots in the ancient Hippocratic and Vedic texts as well as in the canons of Traditional Chinese Medicine (Sharma et al., 2012). Presently, the transition from a traditional to modern lifestyle, consumption of diets rich in fat and calories combined with a high level of mental stress has been the major cause of lifestyle related diseases like coronary heart disease, obesity, diabetes, cancer and hypertension (Moczara et al., 2012; Sharma et al., 2018). Various studies have linked foods as helpful in combating a number of such degenerative diseases (Sharma, 2015).Therefore, the tenet "Let food be thy medicine and medicine be thy food", quoted by Hippocrates about 2,500 years ago is receiving overwhelming interest. There are number of scientific reports emphasizing the importance of consuming biologically active ingredients present in fruits, vegetables, whole grains and legumes to reduce the risk of chronic diseases (Hasler 2002; Das et al., 2011; Sharma and Sharma 2016). Such biologically active ingredients are now popularly known as neutraceuticals. Whereas, the functional foods are the foods that resemble traditional foods but possess demonstrated physiological benefits. In some countries, however, functional foods and nutraceuticals are used interchangeably. Regardless, the main focus of such products is to improve health and reduce disease risk through prevention. The main difference of this category with pharmaceuticals is that they are multi-targeted mixtures and present at low concentration while pharmaceuticals are uni-targeted pure compounds with high dose use. Hence, an overview on the concept of nutraceutical and functional foods, their classification, development and regulations is summarized in this article.

Need to Preserve Food

Food is vital for human existence. Conservation and preservation of food is a prerequisite for food security and it provides economic stability and self reliance to a nation. The need to preserve food has been felt by mankind since time immemorial. The seasonal nature of production, long distances between production and consumption centers and rising gap between demand and supply have made this need even more relevant today. The hot and humid climate of a country like India is quite favorable for the growth of numerous insects and microorganisms that destroy stored crops and cause spoilage of food every year. Spoilage can also occur due to chemical and physiological changes in stored foods. Sea-foods, meat and poultry may carry harmful microbes and parasitic organisms that cause illnesses associated with their consumption. As in other parts of the world, India has also practiced various methods of food preservation such as sun drying, pickling and fermentation which were supplemented with more energy consuming techniques such as refrigeration, freezing and canning. Each of these methods has its merits and limitations. Man has always been on the search for newer methods to preserve foods with least change in sensory qualities. Radiation processing of food is one of the latest methods developed for this purpose.

In this modern era, educated and health-conscious people are increasingly demanding such food products that preserve their nutritional value, retain a natural and fresh colour, flavour and texture, and free from chemical preservatives. Besides, urbanization has extensively affected the life-style of people all over the world. Competition has made their life extremely busy and time has become a very important factor. Hence, recently there has been increase in demand for ready-to-cook or ready-to-use fresh food products of fruits and vegetables along with convenience and safety. This new demand by consumers has opened a new avenue of food preservation known as minimal processing. The products prepared by this processing method are known as fresh cut or pre-pared products. Minimally processed products are also known as lightly processed, partially processed, fresh processed, fresh cut, and pre prepared. It can be defined in many ways for example as "least possible treatment to achieve a purpose". A more specific definition is as the method that "preserve foods but also retain to a greater extent their nutritional quality and sensory characteristics by reducing the reliance on heat as the main preservative action. In a broader way it can also be defined as the processed foods have been slightly altered for the main purpose of preservation but which does not substantially change the nutritional content of the food. Generally minimal processing involves cleaning, washing, trimming, coring, slicing, shredding before packaging and storage at specific temperature. Some of the examples of minimally processed fruits and vegetables include sliced mango cheeks/melons/papaya/apple, pieces of pomelo segments, peeled and cored pineapple, chilled peach, pomegranate arils dressing, shredded lettuce, shelled peas, cauliflower florets, peeled sliced potatoes, diced onion etc. Minimally processed products are important to food service industry such as eateries and catering companies as they offer many advantages over traditional products, with respect to convenience, expense, labor, and hygiene. Even if it is very much liked by people, the production of minimal processed products is limited due to rapid deterioration and short shelf life. Whereas most food processing methods stabilize the products and prolong their shelf-life, minimal processing of fruits and vegetables increases their perishability.

Fruits and vegetables are essential constituents of daily diet and are highly demanded in the recent years from most of the population. They are reservoir of vitamins, essential minerals, antioxidants, bio-flavonoids, dietary fibres and f lavour compounds which fall easily victim to abiotic and biotic adversities. Fruits and vegetables are highly perishable and during the post- harvest, there are considerable losses due to microbes, insects, respiration and transpiration.

The important quality factors of fresh produce contributing to the marketability are texture, colour, appearance, flavour, nutritional value and microbial safety. These quality factors are measured by plant variety, ripening stage, maturity stage pre-harvest and post-harvest conditions. The Post-harvest losses of fruits and vegetables are a serious problem because it rapidly deteriorates them during handling, transport and storage. Edible coating over fruits and vegetables are used to improve their quality and shelf life.

India is bestowed with huge production of fruits, vegetables, cereals, millets, sugarcane along with meat production, milk production, fish production and poultry. Despite such a huge production in India, owing to perishable nature of these produce around 25-30 percent of the produce is being lost as post harvest loss. The one important reason for this may be the production of the crops are season specific and during the peak season the production is more while demand for consumption is less. It may be possible to cut down these losses to great extent, if these produces may be transported from the produces states to those who are not producing due to agro-climatic reasons. So for making transportation of the perishable a successful venture in decreasing post harvest loss, there must be proper cool chain management facilities both at producing site as well as marketing place. The aim of the cool chain management must be to keep the produce in saleable condition during entire storage periods. Some products are stored for short period whereas fresh fruits, vegetables require cold storage. Foods before keeping into the storage room need some pre-storage treatments for better results.

Many post-harvest treatments are applied to horticultural crops, either to maintain the quality (taste, colour, flavour, texture) or improve the visual appeal. Most important of these treatments are temperature management including the cold chain where the temperature of the crop is reduced rapidly and stabilize temperature after harvesting. Exposing the crop to high or low temperature and application of chemicals after harvest helps in managing/ prevent pest and diseases and sprouting occurrence respectively.

Harvested produce must be handled with care at every stage to avoid the mechanical damage and subsequent fungal/bacterial infection. Adopting appropriate post-harvest handling operation will minimize the all ill effects of post-harvest (Fig. 1).

Food Safety

The term “safe food” has different standards to different consumers rather than just being the food handled and prepared through proper cleaning, washing and cooking. Safe food means food prepared on clean and sanitized surfaces with equipment, utensils and dishes that also are cleaned and sanitized. Nowadays consumers are extra conscious about the safety and quality of food and for that reason food safety issues have changed, so have society’s methods for making food as safe as possible. Accordingly, “food safety” means assurance that food is acceptable for human consumption according to its intended use (FSSAI 2017).

The food processing industry ranks fifth in size in the country and employs 16 lakh workers which is 19% of the country’s industrial labour. It accounts for 14% of the total industrial output with 18% of industrial GDP and 6.3% of countries GDP. So, food processing plays a vital role in India’s prosperity. The Food Processing Industry sector in India is one of the largest sector in terms of production, consumption, export and growth prospects. Food processing industry broadly comprises primary processing category and the other categories embracing the secondary, tertiary and further stages of downstream processing. Primary food processing is a major industry with lakhs of rice-mills/ hullers, flour mills, pulse mills and oil-seed mills. There are several thousands of bakeries, traditional food units and fruit/vegetable/spice processing units in the unorganized sector. In the organized sector, there are over 820 flour mills, 418 fish processing units, 6600 fruit/vegetable processing units and 171 meat processing units. Indian processing industries has installed capacity of 21 lakh tones; however these industries actually processed 9.8 lakh tones of the produce. So the total capacity utilization of industries is <30%. There are 70% units in home/cottage/ small scale sector and 30% units in large scale sector with capacity of 250 tonnes per annum and 30 tonnes/hr, respectively. Large scale contributes 70% of the production. The principal crops and commodities which constitute the primary base for the food processing industry and considered important sub-sectors in food processing industries are illustrated in Fig. 1.
