Introduction
Davana (Artemisia pallens Wall.) is one of the important aromatic herb found abundantly in humid habitats in the plains all over India. It is popularly known as sage brush, worm wood and mug word. The davana (Artemisia pallens) is a small to medium height; annual and herbaceous aromatic plant. This herb is erect, and grow up to 60 cm height. Its leaves are highly divided and bears small size yellow coloured flower. Its leaves and stem found protected with greyish-white tomentum. The leaves are lobed, alternate, and petiolate.
Origin & Distribution
It is native to southern India, where it is traditionally grown in Karnataka, Maharashtra, Kerala, T.N., and A.P, growing widely in tropical to subtropical
plains as Rabi season crop. It also found growing in wild form in the Himalayan region in the Simla, Kashmir valley, and Nainital hills. It is widely used by Ayurvedic healers to balance the three energies. It is an erect growing
plant up to 60 cm height. It does not grow wild, but grown as a garden plant in South India. It is a crop of irrigated conditions; and do well when planted in November-December, yielding significantly higher oil yield in comparison to crop planting in July-August. The crop should be harvested 2-3 inches above ground level during bright sunny days at 50 percent flowering stage to have high oil content and oil yield.

Semilooper: Thysanoplusia(Plusia) orichalcea : Noctuidae

Bluish green or grey coloured eggs are laid singly on lower surface of leaves.The larvae are semi loopers and feed voraciously on leaves and cause defoliation of the plants.

Deadweight cost/loss : The extent to which the value and impact of a tax, tax relief or subsidy is reduced because of its side-effects. For instance, increasing the amount of tax levied on workers’ pay will lead some workers to stop working or work less, so reducing the amount of extra tax to be collected. However, creating a tax relief or subsidy to encourage people to buy life insurance would have a deadweight cost because people who would have bought insurance anyway would benefit.

Some of these countries have to pay so much in interest each year to foreign lenders that they have little money left to spend on the long-term solutions to their poverty, such as educating their workers and building a modern infrastructure. In 1998 the world Bank calculated that around 40 of the world’s poorest countries had an “unsustainably high” debt burden : the present value of their total debts was more than 220% of their exports. Debt forgiveness has potential drawbacks. For instance, there is a risk of moral hazard. If countries that borrow too much are let off their financial obligations, poor countries may feel they have nothing to lose by borrowing as much as they can. This is why policymakers often argue that debt forgiveness should come with a conditionality clause, for instance, a requirement that countries have a track record of implementing economic reforms designed to prevent a repeat of the errors that first created the need for debt forgiveness. This is the approach taken by the World Bank’s HIPC (highly indebted poor country) initiative, launched in 1996 and expanded in 1999. However, by 2003, only eight of the 38 poor countries eligible under the programme had made enough progress in reform to have some debt forgiven.

In the entrepreneurial sphere, globalization along with fast industrial progress is supposed to be accountable for occupational health hazards and related workplace ill-being, work insecurity, the lack of protection for workers’ health and well-being in the form of work-related accidents, illness and stress, lack of workers’ compensation and paid sick leave, lack of maternity protection, excessive hours of work, etc.(https://www.ilo.org/). This was evidenced in the recent report of ILO (2023) where it was found that 2.3 million people around the world surrender to work-related accidents or diseases every year which links to over 6000 deaths every solitary day (www.ilo.org). Subsequently, there are about 340 million occupational accidents where 160 million are fatalities of work-related illnesses annually in the World.

Decentralization means the action or fact of reducing or undoing “centralization” or “concentration.” The dictionary meaning of decentralization is “The process of transferring the functions from the Central Government to the local units.” Decentralization is devolving power of decision–making with the lower level of organization. In a decentralization, delegation and devolution of power are given to the lower level. Devolution implies a situation in which lower ranking units acquire greater autonomy in respect of certain defined functions, including decision-making authority. Devolution of functions, powers, and responsibilities are normally granted through legislation.

Decentralized Planning in India

With the introduction of the Community Development Programme (CDP) and National Extension Service (NES) in 1952, increasing agricultural production had been on India’s agenda in different plan periods. The success of CDP and NES was reviewed by the Balawant Rai Committee in 1957 and the committee realized that community development can be achieved only when the community understands its problems, owns its responsibilities, exercises the necessary powers through its elected representatives, and maintains a constant and intelligent vigilance on local administration. The recommendation of the committee led to the preparation of plans at the level of state, district, block, towns, and Panchayats in the second plan period from 1957 to 1962. The Fourth Evaluation Report (Programme Evaluation Organization, Planning Commission) in 1959 recommended that organized and institutional participation by the public in development programs is bound to give better, more consistent, and more lasting results. In 1977, Ashok Meheta Committee suggested changing the concept of Panchayati Raj to a political institution. In 1981, the eminent economist Prof. M.L. Dantewala observed that the merit of decentralized planning is derived from its ability to discover dormant resources and skills and its endeavor to activate them. However, there was slow progress in decentralized planning up to the eighth plan (1992-97).

Storage of paddy seed lots after harvesting is one of the crucial aspects of processing shopfloor. Paddy due to increased mechanised harvesting may loose vital seed quality parameters. Since seed growers cannot buy a combined harvester themselves-they resort to hiring of this machine. Sometimes in the hurry of completing harvesting they harvest the crop at un-safe moisture content. This un-safe moisture content may go up to 50-60% also. Harvesting of seed crop with high moisture has adverse effect on storability. Ensuring safe seed moisture is very critical especially during rabi-summer seed production cycle. Most of the growers depend on sun drying for reducing the seed moisture. But paddy should not be dried >3% in one cycle. Follow tempering and convection cooling after every cycle and repeat the cycle till seed attains safe moisture content (14%).

Therefore, strengthening and expanding women’s roles and opportunities in agriculture promotes sustainable economic development. Gender inequalities are a measurable and significant limit on agricultural productivity and efficiency, undermining rural economic development. India has paved the way to development by increasing its trade and growth in Agriculture sector. To review the agriculture scenario of our country, it depicted that there is need to pay sincere attention towards the human resource development (men and women together) because modernizing agriculture needs skill and efficient work forced. Farm business has become a family enterprise in India, where both men and women take part evenly. It is well known fact that the success of rural development process largely depends on the participation of people at large, irrespective of sex. The content presented in this chapter is exploratory and reflects emerging trends in integrating weather intelligence with decision support systems. The term “weather intelligence” is introduced as a framework, with ongoing research expected to further refine and expand upon these ideas as technologies evolve. In an era where climate variability and extreme weather events increasingly threaten global food systems, the integration of advanced decision support systems (DSS) with what we are now calling weather intelligence has emerged as a transformative paradigm. This chapter explores how food production— encompassing agriculture, fisheries, and animal husbandry—can harness integrated weather intelligence to inform real-time crisis management, strategic planning, and risk mitigation. The discussion is exploratory in many respects, as the concept of weather intelligence represents an innovative framework that challenges traditional forecasting methods and decision support tools (Fig. 9.1). Drawing on multidisciplinary research and practical case studies, we examine the building blocks of decision support systems tailored to food production. We then discuss the integration of weather intelligence into crisis response and strategic planning, highlighting both established risk mitigation approaches and emerging tools designed to anticipate and respond to extreme weather events. By contextualizing these developments within the broader scope of sustainable food production, this chapter offers an in-depth analysis and a forward-looking vision for decision support and response management in a rapidly changing climate.

Soil organic matter plays an important role in the maintenance and improvement of soil properties. It is a dynamic material and is one of the major sources of nutrient elements for plants. Soil organic matter is derived to a large extent from residues and remains of the plants together with the small quantities of animal remains excreta, and microbial tissues. Soil organic matter is composed of three major components i.e. plant residues, animal remains and dead remains of microorganisms. Soil organic matter comprises residues of plants and animals and these compounds occur in soil in close combination with inorganic substances. Animals and plant residues are made up of complex carbohydrates, simple sugars, starch, cellulose, hemicellulose, pectins, gums, mucilage, proteins fats, oils, waxes, resins, alcohols, aldehydes, ketones, organic acids, lignin, phenols, tannins, hydrocarbons, alkaloids, pigments, etc.

The organic matter subjected to microbial decay in the soil comes from several sources like plant remains, forest litter, incorporation of plant tissues, animal tissues, and excretory products. The chemistry of organic matter is very complex, and investigations of the transformations and the responsible organisms have therefore been extremely interesting. The organic constituents of the plants are commonly divided into six categories.

Soil organic matter is among the most complex materials existing in nature. In addition to the organic constituents present in undecayed plant and animal tissues, soil organic matter contains living and dead microbial cells, microbially synthesized compounds and an endless array of derivatives of these materials produced as the result of microbial activity. Soil organic matter probably contains most of the naturally occurring organic compounds. Shifting cultivation is a type of land use that dates back to the dawn of agriculture. It's done in places where forest resources are still plentiful. However, primary forest removal occurs gradually in order to preserve the same fallow time despite population development. As no primary forests remain (or as the remaining primary forests are entirely protected by local customs or conservation legislation), secondary forests fade away, and new techniques arise or are adopted, the fallow period shortens. Natural capital is gradually replaced by man-made productive capital, or the system approaches a state of crisis, depending on whether the limitations to these changes can be levered. In theory, the new land uses allow for more forest protection because they require less territory to provide the same output. In practice, they are triggered or triggered by a series of more radical changes, such as infrastructure development, migrations, financial investments, and new consumer habits, all of which frequently end in large-scale deforestation.

Deer belongs to cervidae family, is one of the source of non bovine milk. Two thousand years ago, the people of Soviet Union along the borders of Russia, Mongolia, and China used to consume deer milk and milk product. Deer milk is a plentiful source of milk solids. The proteins of deer milk is more digestible than bovine milk owing to their unique profile and characteristics. Deer milk being rich in highly digestible protein offers beneficial health effect through bioactive peptide production. The distinctive physico-chemical properties being quite similar to sheep milk shows the milk product manufacturers a scope to use deer milk for production of various dairy products. Although there is immense opportunity to use deer milk for development of diversified functional products, further research work is needed to be carry out to find out the type of biopeptides produced during protein hydrolysis, role of fatty acids, effect of different unit processing on its constituents etc. This chapter delineates the nutritional profile and physico-chemical properties of deer milk along with the significance of it in terms of its therapeutic roles and potential to be used for product development.

Ice cream defects can result from formulation imbalance, poor ingredient quality, processing deviations, inadequate freezing or hardening, packaging problems, storage conditions, and cold-chain failures. This chapter provides a systematic framework for understanding, classifying, diagnosing, and correcting defects affecting flavour, body, texture, melting, colour, appearance, packaging, and storage stability. It emphasizes that a visible defect in the finished product may originate much earlier in the production or distribution chain. Examples include iciness caused by slow freezing or temperature abuse, weak body associated with formulation or overrun, and flavour problems originating from raw materials or microbial activity. 1. Flavour defects in cream: Any flavor imperfections originally present in whole milk may become more noticeable in separated cream. Volatile compounds that are fat-soluble tend to concentrate in the fat portion, which can amplify these defects, such as an oxidized taste. Common flavor defects associated with cream include feed, cooked, malty, musty, utensil, weed, acid, bitter, and oxidized/rancid flavors. These flavor defects are further described in the section discussing flavor issues in Table butter.
2. Specific defects in cream
• Serum leakage, creaming, reduced overrun in whipping cream: Serum leakage typically results from partial churning (overwhipping), causing an unattractive liquid pool around the whipped cream or sogginess when applied to cakes. Excessive whipping leads to the formation of large fat globule clusters, which can break bubble-enclosing membranes, initiate bubble coalescence, and reduce overrun. This process may lead to an irreversible phase inversion, turning the cream into a greasy water-in-oil emulsion, visible as butter granules. Unfavorable creaming and serum separation can be delayed by lowering fat content (within legal limits), adding stabilizers like carrageenan, emulsifiers, or protein ingredients, or through post-UHT homogenization. Using a mix of kappa and iota carrageenan can help reduce creaming during storage and minimize whipped cream drainage.

Introduction

Resistance to disease in a host plants is a condition in which the plant conquer the pathogen’s attack and thus suffers small or no injury. Resistant hosts prevent or slow the development and reproduction of the majority of pathogen propagules that they come into contact with. Different plants defend themselves in different ways. Each kind of plant, probably, employs different defense mechanism against each of the pathogens that attack it. The defense barriers erected by plants are a co-ordinated system of molecular, cellular and tissue-based responses to pathogen attack.

Farming of fish and shellfish has gained significant grounds in several parts of the world. However, the major bottleneck to successful farming is disease in farmed aquatic animals. In recent years, lot of attention is being given to health management using various forms of immunoprophylactic measures such as vaccination and immunostimulation. To rationalise immunoprophylactic applications, it is vital to have insight into the specific and non-specific defense mechanisms of farmed aquatic animals. Through disease process studies it is very well known that a pathogen can cause disease only if it can overcome the non-specific and specific defence barriers of the host and successfully establish and proliferate. Non-specific and specific immune systems are the two main branches of the defense system. The immunity which an organism derives against a pathogen is the result of a delicate interaction and cooperation between the two systems.

Plant diseases are major constraints to plant growth and development (from seed to maturity) resulting in crop losses. Plants are exposed to attack, by a wide variety of microbes like bacteria, virus, fungi, phytoplasma and as an abnormality they cause disease. To counter these threats, plants have evolved a series of defense systems in response to the pathogen challenge inhibiting natural resistance. Thus disease is an exception rather than rule. However on failure of the inbuilt resistance mechanism, outbreak of disease has led to the widespread use of chemicals that have deleterious environmental and human health consequences. To enable the development of more effective and durable resistance against pathogens, a detailed analysis is necessary to identify the genes and mechanisms involved in plant defense/resistance.

Recombinant DNA and gene transformation technologies have potential to augment traditional breeding efforts (limited by genetic variability) by circumventing taxonomic limitations to gene pool for pathogen resistance. Further manipulation of defense genes in transgenic plants provide novel approaches for engineering pathogen resistance. It becomes important to understand the different components of plant defense to exploit host plants for resistance Thus the review is focused on plant genes and proteins that are known to play a major role in plant resistant against pathogens.

Maintaining optimal rumen function depends heavily on a balanced diet that meets the animal’s nutritional requirements. Deficiencies in key nutrients can lead to ruminal disorders, disrupting the fermentation process, impairing nutrient absorption, and compromising overall animal health and productivity.
a) Cobalt deficiency causes ruminal disorders
Cobalt deficiency is a significant concern in ruminants, as it plays a vital role in their health and productivity. This trace element is an essential component of vitamin B12 (cobalamin), which is synthesized by rumen microorganisms and is critical for various metabolic processes. Cobalt deficiency leads to a cascade of health issues, prominently manifesting as ruminal disorders. Here explores the mechanisms, symptoms, and management of cobalt deficiency in ruminants, focusing on its impact on ruminal health.

4.1. Deficiency symptoms in different plant parts

Nutrients are important for growth and productivity of crops. Apart from the N, P, K, Ca, Mg and S, micronutrients such as Zn, Fe, Cu, B, Mo, Mn, Cl, etc. are also necessary for maintaining normal health and metabolism of plants. However, nutrient deficiency can lead to poor and stunted growth of plants resulting in poor yield performances. The depletion of nutrients from the soil is increasing due to adoption of modern agricultural technology through intensive and extensive cultivation of high yielding varieties. Nutrient deficiencies are very common in horticultural crops rather than in field crops.

Identification of nutrient deficiencies in crop plants through visual symptom is the cheapest diagnostic technique. When a nutrient element insufficiency occurs, below the critical level, visual symptoms may or may not appear, although normal plant development will be slowed. When visual symptoms occur, such symptoms can frequently be used to identify the source of the insufficiency.

2.1. GENERAL DESCRIPTION

Forests covered only 31 per cent of the land in the world in 2011, while land used for agriculture, (cultivable land, perennial crops and pastures), covered 38 per cent (FAO 2011). In the history of humankind, agriculture is a recent invention (Mazoyer and Roudart, 2005). With the transition from the huntergatherer lifestyle to one of agriculture during the Neolithic Revolution, farmers quickly expanded their activity into forest areas. They developed shifting cultivation, an agricultural practice with temporal rotations in forest ecosystems. Shifting cultivation still exists today in tropical regions and is the livelihood basis for hundreds of millions of people (Mertz et al., 2009). The range in the population estimate is extremely wide, because of difficulties in counting smallholders spread out under the tree canopy at the margins of tropical forests, as also due to confusion that exists in differentiating shifting cultivators from other farmers involved in small-scale agriculture (Thrupp et al., 1997).

Therefore the work output depends on how efficiently the workers are performing. In this context, the health of the worker is of utmost importance. It is one of the prime supporting pillars of productivity. If the health condition declines, efficiency is reduced and productivity suffers. Work involves a variety of physical and cognitive activities performed to achieve a desired or specified productivity. It may include a single individual or a small or large group of people as the worker. It is characterized by a specified duration, specific speed or work pace and a required amount of effort. The stress could be classified as physiological stress and psychological stress Occupational health deals with the study and maintenance of physical, mental and social well-being of workers in the workplace (WHO, 1957). Occupational Physiology and Ergonomics are related branches of Occupational health that are in particular concerned with the study and maintenance of health and well-being during work.

The oldest written records of the human race are in Sanskrit and are preserved in India. At the time these records began, about 6,000 years ago, milk had already become an important article of food. In fact, so important was the cow to these early people of South and Central Asia that wealth was measured in numbers of cattle, and the cow was in time made a sacred animal and is still so considered in India.

According to the best authorities, the domestication of cattle must have occurred somewhere between 6,000 and 10,000 years ago. The cow was worshipped in Babylonia, and in Egypt about 20,000 B.C. Over fifty references to cows and milk are found in Old Testament and the Promised Land was described as “a land flowing with milk and honey”.

Milk is the only food of the young mammal during the first period of its life. The substances in milk provide more energy and the building materials necessary for growth. Milk also contains antibodies which protect the young mammal against infection. A calf needs about 1000 litres of milk for growth, and that is the quantity which the primitive cow produces for each calf. There has been an enormous changes since man took the cow into his service. Selective breeding has resulted in dairy cows which yield more than 5,000 litres of milk per calf, i.e. five times as much as the primitive cow. Some cows can yield 10,000 litres or more.

Agricultural finance generally means studying, examining and analyzing the financial aspects pertaining to farm business, which is the core sector of India. The financial aspects include money matters relating to production of agricultural products and their disposal.

What is a Farming System?
A farming system is a complex and interconnected set of components, activities, and interactions that occur on a farm. It’s a holistic view of agriculture that considers not only the crops grown but also the livestock raised, the resources used, the environment, and the socio-economic factors that influence the farmer’s decisions. It aims to optimize productivity and sustainability. A farming system is a population of individual farm systems that have broadly similar resource endowments, enterprise patterns, household livelihoods, constraints, and for whom similar development strategies and interventions would be appropriate. It is a complex interwoven mesh of soil, plant, animal, people and other resources surrounding by a distinct boundary jointly managed by farm households. A farming system refers to a complex, interrelated matrix of soil, water, crops, animals, labor, and other resources managed by farm households to increase productivity and ensure food security. It goes beyond crop production alone—it is a holistic concept that includes all on-farm and off-farm activities contributing to a family’s livelihood. Farming-based livelihood systems emphasize the role of agriculture and allied sectors in supporting rural life and sustainability.

What are Pesticides?

Pesticides are essential tools for controlling harmful and invasive pests in agriculture, forestry, and the landscape. Pesticides are any substances used to prevent, eliminate, repel, attract, or diminish pest organisms. Pesticides that are well-known include insecticides, herbicides, fungicides, and rodenticides. Growth regulators, plant defoliants, surface disinfectants, and several swimming pool chemicals are among the others. Insecticides include pesticides (effective against insects), herbicides (effective against certain plants), rodenticides (effective against rats), bactericides (effective against bacteria), fungicides (effective against fungi) and larvicides (effective against larvae).

Disease in plants defined as the series of invisible and visible responses of plant cells and tissues to a pathogenic organism or environmental factor that result in adverse changes in the form, function, or integrity of the plant and may lead to partial impairment or death of plant parts or of the entire plant.

A pesticide is any material intended to prevent, destroy, repel, or mitigate any pest, which is defined as a living organism that occurs where it is not wanted or that causes damage to crops, humans, or other animals. There are many different types of pesticides, each is meant to be effective against specific pests. The term “-cide” comes from the Latin word “to kill.”

6.1 general description

Between 13,000 and 3,000 BC, Neolithic period, mountain people in Asia, Africa, and Latin America have practiced shifting cultivation (Mazoyer and Roudart 2006). A cultivation phase, consisting of removing forest and crop production for 1 to 3 years, is followed by a fallow phase, in which agriculture is discontinued to allow soil nutrients to recoup (Conklin 1961). Conklin (1961) distinguished between total and partial shifting cultivation. Pioneer shifting cultivation, in which primary or apex forest is cleared annually, and replaced by shifting cultivation, which entails clearing mostly secondary forests, are both essential forms of cultivation that are primarily practised for farmers' subsistence. Partial shifting cultivation, on the other hand, is done as a supplemental or temporary activity (Conklin 1961). Throughout history, indigenous peoples have used fire to manage their land and natural resources. Pastoralists and hunters-gatherers in Africa's savannas, for example, have used fire to preserve the ecosystem's productivity for livestock and game for millennia (McClanahan and Young 1996). In pre-colonial times, indigenous peoples in North America also significantly altered the landscape, establishing and preserving pastures and open forest savannas through regulated burning (Pyne 1982, cited in: Schneider 2000).

Herbicides degrade over time. The persists of herbicides is dependent on several factors including light, temperature, and substrate moisture. Several processes are responsible for herbicide degradation and include the following:

    1.    Photodegradation: The decomposition of herbicides caused by duration or intensity of sunlight is called as Photodegradation. Photodegradation occurs when ultraviolet (UV) light breaks chemical bonds of the herbicide active ingredient. Secondary molecules resulting from the cleavage of the parent molecule are generally less effective in providing weed control. Herbicides such as Monuron, Trifluralin, PCP, Chloramben etc are prone to photodegradation. So these herbicides should be applied in evening or incorporated in to the soil just after application in order of avoiding photodegradation.

Land, a non-renewable resource, is central to all primary production systems. Over the years, the country’s landmass has suffered from different types of degradations. Land degradation can be defined as lowering of land productivity due to the deterioration of land’s physical, chemical and biological condition. Physical land degradation is due to water erosion, wind erosion, compaction, crusting and water logging and chemical degradation is due to the processes of salinization, alkalization, acidification and nutrient depletion. Biological degradation is due to the reduction of soil biota and organic matter, degradation of vegetation and impairment of activities of microflora and fauna. Land degradation is steadily increasing due to the growing pressure on land and unsustainable land use. Land degradation and the associated loss of soil productivity and quality is of great concern both from food production and environmental conservation point of view. An ever-increasing population created enormous pressure on land resources.

Flowers and various parts of the plant have been used for decoration and to commemorate various religious, festive, matrimonial and social gathering events in day to day life. The main drawback of fresh flowers and foliage is being highly perishable and delicate which cannot retain their beauty for longer durations. Moreover fresh flowers are not available round the year which can be overcome by the dehydration and drying techniques. Since ancient times, in Egyptian pyramids, fragrant dried flowers and herb garlands were encased along with mummified bodies. Japanese people created “Oshibana”, the “preserved flower art” of enduring designs to retain the exquisite beauty of the living plants centuries ago.

Later on, this craft making technique spread from Japanese to Victorian England because of their beautiful long lasting appearance. During middle ages monks dried flowers, foliage, and herbs for use in decorative motifs or for colouring their handprinted books.

Dried flower arrangements have been popular in Europe for centuries, and as early as 1700 AD, colonial Americans used dried flowers to brighten their homes, especially during the dark winter months.

Earlier botanists practiced dried flowers in the form of herbarium for the purpose of identification of various plant species. Though drying of flower was well known even in the past but for the first time the flowers were dried commercially in Germany (Sankari and Anand, 2014).

INTRODUCTION

Drying or dehydration is defined as the removal of moisture from its initial level to a level which renders food materials safe for subsequent storage. It is a simultaneous heat and mass transfer operation in which heat is supplied externally to evaporate moisture and air is forced through the bed to carry away the moisture. Drying is the oldest technique to preserve food materials. Advantages of drying include reduction in water activity, enhancement of shelf life, maintenance of flavor and nutritive value, and reduction in packaging and transportation costs. When the water activity of the dried product is reduced to below 0.6, most microorganisms do not grow and the rates of other deteriorative reactions are substantially reduced.

Drying is the oldest known method of preserving food. Drying or dehydration is removal of majority of water contained in fruit or vegetable. Although preservation is the primary reason for dehydration, it also lowers cost of packaging, storing and transportation by reducing both weight and volume of final product. In addition, dried foods add variety to our diets. In the process of drying, sufficient moisture is removed to protect product  from  spoilage. Processing should be done in such a way that food value, natural flavour and characteristic cooking quality of fresh material are retained after drying.

Materials Required

Dehydrator, balance, thermometer, sulphur dioxide, blanching pan, fruits / vegetables, polythene or aluminium bags.

Procedure

    1.    Select sound fruits or vegetables 
    2.    Record their initial weight and wash them properly in plain water to remove any dirt or extraneous matter. 
    3.    Peel with stainless steel knife (as the case may be) and cut into thin uniform pieces or slices of  0.2-0.5 mm thickness
    4.    Blanch the slices in boiling water for 1-2 min. to inactivate the enzymes followed by immediate cooling.
    5.    Treat the slices with sulphur (sulphuring or sulphiting) in order to prevent darkening of the product during drying. 
    6.    Dry the slices in a mechanical air dehydrator at about 55 + 5oC temperature.
    7.    Record the weight of the product after every 2 hr till it becomes (almost) constant i.e. when there no more (significant) loss of moisture from the product.
    8.    Pack the product in ploythene or aluminium laminated pouches and seal them air tight. 
    9.    If it is to be converted into powder, the dried product can be ground in a grinder before packing.
    10.    Label the packages and store them in a cool dry place.
    11.    Plot the drying rate curve of the product on a graph paper and analyse it.
    12.    Record the initial and final moisture content of the product (as discussed in Exercise No. 19).

Drying generally refers to the method of removal of moisture from the food under natural conditions such as sunlight and wind for example open sun drying, shade drying etc. Whereas, dehydration refers to a process of removal of moisture by application of artificial heat under controlled conditions of temperature and airflow. In this case single layer of fruit and vegetables, either whole or sliced after primary pretreatments is spread on trays which are placed inside the dehydrator or in the open sun for drying. In the dehydrator, the initial temperature is generally kept at 43oC which is then gradually increased to 66-71oC for fruits and 60- 66oC for vegetables. Dried grapes (raisins and monucca), apricots, dates, apple rings/cubes, Morchella (Guchhi), bael, aonla, fig, green peas, cauliflower, cabbage, onion, garlic etc are commercial products prepared by using drying.
Procedure for drying: Drying generally involves three stages: pre-drying treatments or pre-treatments, drying of commodity and post-drying operations such as handling, packaging and storage. The flow sheet for drying of fruit and vegetables is shown in Figure 1 and details of pretreatments for drying fruits and vegetables are shown in Table 1&2 respectively.

49.2. Theory

Drying refers to the method of removal of moisture content from the food to a level at which the activities of food spoilage and food poisoning micro-organism are inhibited. Therefore, reduction in water activity of the food is the main principal of preservation by drying. In the dehydrator initial temperature is generally kept at 43oC which is then gradually increased to 60-66oC for vegetables. The product shall be prepared from wholesome vegetables free from blight, insect infestation and fungal discoloration. Only edible portion of the vegetables shall be used and it shall be free from stalks, peels, stems, and extraneous matter. The dried/dehydrated vegetable may contain permitted preservative. The finished product shall be of good edible quality and shall reasonably reconstitute to its original shape and quality on boiling for 15 minutes to an hour. The finished product shall be free from visible mould, insect or larvae. Kind of dry vegetable shall be declared on the label. Acid insoluble ash shall not be more than 0.5%.
