21.1 Introduction
Khoa, as well as mawa or khava, is a partially dehydrated whole milk product that is produced by perpetually heating milk in a karahi over a direct fire while stirring and scraping it with a khunti until it reaches a semi-solid consistency. The pan is removed from the fire once the desired consistency is obtained, and the contents are transformed into a solid mass known as khoa pat. “Khoa is produced by rapid drying cow, buffalo, goat, or sheep milk, or a combination thereof, and must contain a minimum of 20% milk fat.The product is produced by heat desiccating milk to 65–69% solids in an open pan. Khoa has been utilised as a foundation for Indian desserts for centuries. Milk traders and halwais prepare it according to the conventional procedure. You typically require five times the amount of milk content.

21.2 Classification
There are three primary varieties: “pindi” for burfi, “dhap” for gulab jamun, pantooa, and other delicacies, and “danedar” for kalakand. Khoa production has been the most straightforward technique of preserving milk produced in rural areas during the flood season. Pindi, dhap, and Danedar are the three primary varieties of khoa that are prepared throughout the country. Khoa is the foundation for a diverse array of Indian delicacies, such as gulab jamun and other dishes.

26.1 Introduction

The evolution of appliances and packaging tools as well as the introduction of fresh and better packaging materials has happened holistically. In nations like India still in development, packaging is still in its infancy. Packaging any product is the arrangement of the most appropriate containers and components to safeguard, move, label, and identify any good.
26.2 Packaging
Packaging is putting an item into a protective wrapping or container for use or storage. The package serves three purposes: it stores, shields, and merchandising tool. For the safe delivery of the product through the several phases of manufacturing, storage, transportation, distribution, and marketing, it is a necessary link between the manufacturer and ultimate customer. Fresh, sound and easy form of milk delivery depends on protective packaging to minimise losses and withstand the challenges of climate change, transit, handling etc.
1. To contain the product: The package should be big enough and built with suitable elements to stop spoiling and leaks. It should be sturdy enough to withstand handling, shipping, and storage difficulties as well as closely matched with the product.
2. To protect the product: Packaging seeks to protect the product from microbiological activity, heat, light, moisture, oxygen, evaporation, etc., therefore preventing contamination, loss, damage, or degradation.
3. To help in selling the product: Easy dispensing, reclosure, disposal, and possible reuse should be made possible by the packaging form, therefore helping the marketability of the product.

Weather parameters, such as temperature, humidity, rainfall, and wind, play a significant role in the epidemiology of viral diseases in crops. Viral diseases, caused by viruses that infect plants, can have devastating effects on crop yields and quality, leading to significant economic losses for farmers and the agricultural industry. The impact of weather parameters on viral diseases is complex and multifaceted. Weather conditions can influence the spread of viruses, the survival and multiplication of virus vectors, and the susceptibility of plants to virus infection (Fig. 9.1). Understanding the relationships between weather parameters and viral diseases is essential for developing effective disease management strategies and mitigating the impacts of viral diseases on crop productivity. Humidity and rainfall can influence the spread of viruses by affecting the movement and behavior of virus vectors, such as insects and nematodes. Wind can also play a role in the spread of viruses by dispersing virusinfected pollen and insects. This chapter will explore the effects of weather parameters on viral diseases in crops, with a focus on the relationships between temperature, humidity, rainfall, wind, and viral disease epidemiology. By examining the complex interactions between weather parameters and viral diseases, we can gain a deeper understanding of the factors that contribute to the spread and impact of viral diseases in crops, and develop more effective strategies for managing these diseases.

Weather forecasts play a crucial role in disease control measures for crops. By providing advance warning of favorable conditions for disease outbreaks, weather forecasts enable farmers to take proactive measures to prevent or mitigate the impact of diseases on their crops. This approach is particularly important in modern agriculture, where crop diseases can have devastating effects on yields and quality. The relationship between weather conditions and crop diseases is complex, with factors such as temperature, humidity, rainfall, and wind direction all playing a role in the development and spread of diseases. For example, high humidity and rainfall can create ideal conditions for fungal diseases, while warm temperatures and dry conditions can favor the development of bacterial diseases.By analyzing weather forecasts, farmers can identify periods of high disease risk and take steps to protect their crops. This might involve applying fungicides or bactericides, adjusting irrigation schedules, or implementing other cultural controls to reduce the risk of disease outbreaks (Fig. 12.1). In recent years, advances in technology have improved the accuracy and availability of weather forecasts, making it easier for farmers to access the information they need to make informed decisions about disease control.Additionally, the development of predictive models that incorporate weather data, crop phenology, and other factors has further enhanced the ability of farmers to anticipate and manage disease outbreaks . Overall, the use of weather forecasts in disease control measures is a critical component of integrated disease management (IDM) strategies, which aim to minimize the economic, environmental, and social impacts of crop diseases. By leveraging advances in weather forecasting and predictive modeling, farmers can reduce their reliance on chemical controls, promote more sustainable agricultural practices, and improve the overall health and productivity of their crops.

The word “Veterinary” has originated from Latin “veter?n?rius” concerning draught animal and “Medicine” from Middle English, Middle French, Old French and Latin words meaning “healing”. Veterinary medicine is the offshoot of the medicine dealing with the diagnosis, treatment and prevention of diseases/disorders of all animal species including domestic, wild and exotic, companion, draught and pack animals. Medication refers to administration of drugs. The route, dose and frequency of the drugs administration is most important in providing health care and welfare of the animals. Wide range of body size and their weight in animals and rearing practice makes the treatment and drug administration strategies a bit complex. Because of this complexity wide range of drug formulary and drug delivery strategies has been developed in animals for health care. Route of drug administration varies from oral administration, parenteral administration to local application on skin and mucus membrane. Similarly forms of the drugs varies from liquids, semisolids to solids for oral administration; from clear solution, suspension, emulsion to powder for parenteral administration; and from powder, cream, paste, suspension, ointment, solutions to emulsifiable concentrates for local application. Liver is one of the largest and most sensitive organ in the body performing important role in digestion and metabolism; regulation of nutrient; and production of proteins, enzymes, hormones, clotting and immunological factors. Liver also plays significant role in detoxification. Liver is affected in both primary and secondary liver diseases. Clinical signs of the hepatic dysfunction appears only after a large portion of the liver (about 75%) is inactive because liver has a large reserve of function. Therefore, a systematic clinico-pathological examination of the liver becomes mandatory to identify liver abnormalities. Respiratory examination is essential for identifying abnormalities of the upper and lower respiratory tract and determining the location and severity of disease. Respiratory rate, effort, pattern, nasal discharge, coughing and abnormal respiratory sounds are important clinical findings. The musculoskeletal system provides structural support, protects organs and enables movement. Diseases involving muscles, bones, joints, ligaments and tendons commonly produce lameness, pain, weakness, reduced mobility and deformity. This chapter presents general and special examination techniques for evaluating musculoskeletal abnormalities. Assessment includes observation of posture and gait, palpation of muscles and joints, evaluation of swelling, pain and abnormal movement, and examination of limbs and feet. Additional diagnostic procedures may be used to localize lesions. The chapter provides practical guidance for systematic examination and emphasizes accurate identification of affected structures to support diagnosis and appropriate clinical management.

Udder examination is essential in dairy animals because mastitis directly affects animal health, milk quality and farm productivity. This chapter presents practical examination of the udder and teats, including inspection and palpation for abnormalities. Mastitis detection methods include the California Mastitis Test and other milk-based diagnostic procedures. Evaluation of milk characteristics, somatic cell changes and laboratory findings helps identify inflammatory and infectious processes. Appropriate sampling and interpretation support selection of effective treatment. The chapter also emphasizes the importance of early detection and systematic udder examination in maintaining milk quality, preventing production losses and improving overall dairy herd health.

Veterinarians may encounter disease outbreaks, sudden increases in illness or unexplained changes in herd production. This chapter presents practical approaches to investigating and controlling such outbreaks. Effective investigation requires systematic collection of clinical, epidemiological, management and environmental information. Identification of affected animals, temporal patterns, potential sources and routes of transmission helps establish possible causes. Appropriate diagnostic sampling and laboratory investigations support confirmation. Immediate control measures may include isolation, biosecurity, treatment, vaccination and environmental management depending on the suspected disease. Besides physical examination, there are many diagnostic techniques for making a specific diagnosis of respiratory diseases. The specialized techniques are used by the specialists. These specialized examination techniques include collection of nasal and brochoalveolar samples either using nasopharyngeal swab or flexible fiber endoscopy and their laboratory examination; pleuroscopy; thoracocentesis; thoracic radiography; and thoracic sonography. Collection of Respiratory Tract Discharges/Fluid The respiratory tract discharges (nasal, bronchoalveolar fluid) can be collected using nasopharyngeal swabs and flexible fiber optic endoscope or flexible tube. Nasopharyngeal swab collection Nasopharyngeal swabs have been used to identify PI3 and IBR infections. Pasteurella isolates may be commensals. Bronchoalveolar samples are more exact than nasopharyngeal swabs in identifying

Peritoneal Fluid Peritoneal fluid (PTF) is an ultra-filtrate of plasma. The amount of the fluid and its constituents depends on oncotic and hydrostatic pressures, vascular permeability, mesothelial lining integrity, and lymphatic drainage. In healthy animals, the amount of peritoneal fluid is negligible making its aspiration difficult. However, in large animals, a small volume (up to 5ml) can be aspirated. Volumes of 10ml or above may indicate a pathological process in the abdominal cavity, unless the animal is in late pregnancy. Indications for collection and analysis The collection and analysis of peritoneal fluid is important in the diagnosis of diseases of the peritoneum and the abdominal segment of alimentary tract .Increased accumulation of peritoneal fluid may be evident in congestive heart failure, peritonitis, nephrotic syndrome,

Musculoskeletal system consists of muscles, cartilage, bones, joints ligaments and tendons. Primary function of the musculoskeletal system is to support the body, helps in mobility, and protects vital organs of the body. Diseases of these organs have clinical manifestations such as lameness, failure to support weight, inefficient joint movement and deformity. Examination of musculoskeletal system includes general as well as special examination. General examination consists of examination of posture in sitting/recumbency, standing position and while rising; examination of gait; and any other abnormality. General Examination The animal is observed for conformation (outline and shape), symmetry and posture in standing position from the cranial, caudal and lateral positions. Asymmetrical shape of the body or limbs may be due to swelling that should be examined by palpation,

The udder is responsible for milk production. It is composed of four mammary glands each with its own teat (Fig. 167). Swelling of udder or teats is an indication of udder disease warranting clinical exploration and palpation. Visual examination the udder (before and after milking) and palpation is of great significance in detecting abnormalities. The udder is visually inspected from back and sides for symmetry and also palpated thoroughly. Palpation is a simple, quick and easy routine diagnostic tool for mastitis detection. Teats and supra mammary lymph nodes should also be palpated. These examinations aid in detecting fibrosis, inflammation or atrophy. Diffuse fibrosis gives the quarter a firm feeling. Areas of local fibrosis may vary in size and shape. Hot, painful and diffuse swelling with marked abnormality of mammary secretion is seen in acute mammary inflammation (acute mastitis). Atrophy of the gland is the terminal stage of chronic mastitis. With the development of gangrene, the area becomes cold and bluish. Five point palpation scores (Petrovski et al., 2011; Hogan et al., 1995; Scaletti and Harmon, 2012)

Herd A large number of animals that live and feed together in a group (Fig.197) is called as herd. In herd, all animals are considered as a unit rather than individual. Herd medicine, also known as herd health or production medicine, is the discipline of veterinary medicine that deals with the diagnosis, treatment and prevention of the diseases in the herd as a whole. Concept and Significance of Herd Health Herd health is a combination of regularly scheduled veterinary activity and management practices undertaken to maintain optimum health to achieve optimum production in the farm. Traditionally, the aim of the herd health is to control or eliminate diseases and rectify management inefficiencies impacting the welfare and productivity in the frame work of risk monitoring and assessment in conjunction with best farming practices. Infectious diseases are illnesses caused by pathogens such as viruses, bacteria, fungi and parasites. Infectious diseases usually spread in animals through contact, contaminated food or water and through bug bites. Some infectious diseases are minor while others are very serious. Infectious diseases in the production animals are of great economic concern owing to losses though morbidity, mortality, reduced production, increased food insecurity, public health concern, increased cost of veterinary care etc. Therefore, prevention and control of infectious diseases of animals is very important for food security and safety, public health, animal welfare, access to market and alleviation of rural poverty. Key Factors for Effective Pevention and Control of Infectious Diseases The key factors for effectiveness of prevention and control strategies of infectious animal diseases are, (i) effective surveillance (active i.e. planned; or passive i.e. event based), (ii) an early detection of infection (making an early diagnosis with laboratory support), (iii) transparency and rapid response mechanism; and(iv) good governance.

In this situation, broad objectives of the clinician are:- i) To halt the progress of disease ii) To determine the reasons of outbreak iii) To recommend the procedures to reduce the risk of future outbreaks Terminology used in Disease Outbreaks The following terms are commonly used Outbreak - It defines as a sudden increase in the occurrences of a disease when cases are in excess of normal expectancy in the population for the location, season or species. It may affect a small and localized group or may affect a large number of animals. Epidemic- It has been described as an unexpected increase in the number of cases of a particular disease in a specific geographical area. In another words an epidemic is an rapid spread

Livestock plays a vital role in any country’s economy as animals are a source of livelihood for people, providing milk, meat, and fur, and are used for agricultural work. Hence, the loss of animals due to disease or any other reason results in loss of wealth, livelihood, and nutrition. In view of this, management of mortality on farms is of utmost importance. There are different ways to manage and dispose of dead animals. The acceptable methods to manage mortality include composting, rendering, incineration, landfills, burial, and disposal pits. Composting is one of the options for managing mortality on farms. Composting is the decomposing of carcasses by natural processes, viz the use of bacteria, fungi, and other microorganisms to convert organic matter into a stable product called compost. Composting involves the degradation of the carcass by anaerobic bacteria to convert it into liquid material with odor and gases such as hydrogen sulfide and ammonia)The anaerobic process produces heat that kills many viruses and bacteria and allows the growth of only heat-tolerant bacteria)The temperature continues to rise and peaks between 130 to 160 0F. Composting requires a source of energy

Need of Bioinformatics

Bioinformatics, an emerging area offering a fundamental tool to the scientific community, to speed up the research, application and commercialization of biotechnology. In fact the best thing, which has happened towards the end of the 20^th century and in the 21^st century, is the marriage between biotechnologists and information technologists leading to the growth and development of this field. India took a lead as early as in the 1980s but more precisely from 1986 onwards by establishing a strong base of Bioinformatics with the necessary infrastructure. As a result one has seen major breakthroughs in biology and the growth of biotechnology has been phenomenal in the last decade, especially with the most outstanding technological breakthrough of the 20^th century wherein the draft human genome sequence was completed in 2000 and now the genetic code is completely sequenced. This has provided the worlds scientific community information on the vast sequence and structure of the Genomes, the crystal structures and there is an increasing dependence on computational approaches. Biotechnology has emerged as a front-line area with vital significance in unraveling secrets of life, particularly in the studies of new biology and biotechnology. The genomic revolution has underscored the central role of Bioinformatics in understanding the very basic of life processes.

Introduction

Castor (Ricinnus communis L.) is an important non-edible oilseed crop and occupies an important place in the country’s vegetable oil economy. The crop is mostly confined to Gujarat, Andhra Pradesh and Rajasthan. Although other states like Tamil Nadu, Karnataka, Orissa, Maharashtra, parts of Madhya Pradesh, Bihar and Chhattisgarh cultivate castor, their contribution to either area or production is limited. Presently, castor is grown over an area of 8.7 lakh hectares with a production of 11.7 lakh tonnes and productivity of 1352 kg/ha in the country (2008-09). Castor oil finds application in manufacture of a wide range of ever expanding industrial products such as nylon fibres, jet-engine lubricants, hydraulic fluids, soaps, varnishes, paints, medicines and a host of similar other products. Castor cake is used as manure and also as nematicide. Gujarat and Andhra Pradesh put together contribute to 68.5% of the total castor area and 80% of the total castor production in the country. The crop has been cultivated under resource-rich irrigated conditions in Gujarat with very high productivity (1963 kg/ha), while in Andhra Pradesh, the crop has been cultivated under rainfed and poor resource management conditions, with very low productivity (509kg/ha).

Nanotechnology has proved to have infinite potential in increasing the quality of life of the human population. There is however, a growing realization regarding the potential health and safety risks of associated with development, production and application of these nanoparticles. Nanoscale particles are produced from a variety of different processes. Nanoparticles are the end product of a wide variety of physical, chemical and biological processes, some of which are novel and radically different, others of which are quite commonplace. Nanometer sized particles are also found in the atmosphere where they originate from combustion sources (traffic, forest fires), volcanic activity, and from atmospheric gas to particle conversion processes such as photochemically driven nucleation. A large quantity of nanoscale particles are also produced during the various human activities, Welding can generate large quantities of nanoparticles usually in the form of a well defined plume of aggregated nanoparticles.
