Introduction Rapid increase in world population in last few decades has challenged the food producing sector (Agriculture, poultry, dairying and aquaculture) massively to meet the global food demand. The population is expected to be 9.9 billion by 2050 which means the food producing sector have to increase production by 60% further more than the current production (FAO, 2020). According to FAO (2016) approximately 17% animal protein and 7% total protein consumed by humans were provided by fish. Accordingly, per capita fish consumption was gradually increasing worldwide at 1.5% rate annually from 9.0 kg in 1961 to 20.5 kg in 2017 (FAO, 2018; Fajardo et al., 2022). Aquaculture which accounts for 47% of total fish production is expected to overtake capture fisheries by 2024 and reach 52% by 2029 (FAO, 2020).

INTRODUCTION

Litchi(Litchi chinensis) is an important sub-tropical evergreen fruit crop. The tree bears heart-shaped, conical, or spherical drupaceous fruits with a thin, indehiscent pericarp that surrounds the sweet, translucent, succulent, and juicy aril. Although litchi originated in the Asia-Pacific region, orchards are found in more than 80 countries. Having introduced into India by the end of the 17th century, litchi is an important fruit crop in India and is a source of livelihood to millions especially in the Gangetic plains along the foothills of the Himalayas where the crop is grown popularly. Bihar is the major litchi-producing state in India accounting for about 37% of both national acreage and production. Muzaffarpur is famous for its Shahi litchi and is popularly referred to as the ‘Litchi City’ or ‘Litchi Hub’.In India it is grown in an area of about 85000 ha with total production of 528000 MT. Bihar is followed by West Bengal, Jharkhand and Assam in terms of production, while the highest productivity of litchi (16 MT/ha) is reported from Punjab.

Maize production in India has been dominated by erstwhile Andhra Pradesh and Karnataka which together contribute around 38 per cent of the total maize production of the country. Erstwhile Andhra Pradesh has achieved the highest mean yield of 4441 kg/ha in the country during the last decade (2001-02 to 2010-11) by surpassing Karnataka which had the highest productivity in the country, earlier. The main reason for achieving the highest productivity in the country was due to adoption of improved production technology along with 100% area grown under hybrids. In Telangana, maize is the third most important crop after rice and cotton. It is cultivated in 5.74 lakh hectares, predominantly in Kharif season (4.54 lakh ha), with a productivity of 3.69 t/ha (2015-16).

The erstwhile Andhra Pradesh (including Telangana) is the non-traditional maize growing state. But, the climate of the state is very favorable for the crop and hence maize can be grown in any season in the state. However, it is mainly grown as a rainfed crop during monsoon season, concentrated in Telangana. The trends in area, production and productivity of maize in erstwhile Andhra Pradesh have shown a remarkable increase during the past six decades. During 1955-56, the maize acreage in the state was very less (1.89 lakh ha), which has been up by 5.3 times to the present (2014-15) level of 9.95 lakh hectares. The production has also increased dramatically from merely 1.14 lakh tonnes during 1955-56 to 42.36 lakh tones during 2014-15, which is nearly 37 times higher. Similarly, the productivity of maize in the state was merely 601 kg/ha during 1955-56, which has been increased to 4257 kg/ha during 2014-15 (Fig. 1).

Introduction to Soil Restoration and Management

One of the most crucial elements for human survival is the availability of arable land. Desertification caused by land degradation has emerged as a serious global environmental threat to human well-being and sustainable development in recent years because of both climatic shifts and an increase in human activities that have direct impacts on soil. It has been widely alarmed by the United Nations Convention to combat desertification and has shown considerable interest in this issue (UNCCD, 2015). Soil degradation is used to describe the transformation of arable land into unproductive land because of natural processes, typically accelerated by human activity (Lal, 1993).

Agronomic methods are supported with mechanical measures where land slope exceeds permissible limits and runoff gains erosive velocities. The following boxes explain the nature of agronomic measures which are essential in inter-bunded or terraced areas. These practices enhance the utility value of all kinds of mechanical structures.
1. Contour Tillage: All agricultural operations such as ridging, ploughing, harrowing, sowing, trenching, etc., are recommended to be done on the contour wherever possible or at least generally across the direction of the slope where holdings are very small. Even though the operation is very simple, it plays a major role in retarding the process of soil erosion through runoff. It also conserves soil, and due to increased time of concentration, more rainwater seeps through the soil profile to recharge ground water. Summer ploughing leaves the soil highly absorbent of initial rains.
2. Dead furrows: When all tillage operations are complete, it is advisable to leave a deep dead furrow at every 10 m interval. This should remain in position until the crop is harvested. Dead furrows aid in reducing the runoff velocity and they also conserve water.
3. Organic Matter: Indian soils are very poor in organic matter, especially in drought-prone areas: This can be improved by leaving the crop residue in situ (on the fields). Adding organic manures such as farmyard manure and compost every year as basal application to the soil improves the physical condition of the soil considerably.
Soil-Air, Soil-Temperature, and Soil-Moisture relationships are well balanced with the presence of organic matter. Organic matter improves the activities of soil microorganisms and also provides the much needed micro plant nutrients of all kinds, besides nitrogen, phosphorus and potash. Addition of large amounts of chemical fertilizers to dryland crops should be discouraged as it damages the soil due to:

Excess water in the crop root zone soil is injurious to plant growth. Artificial drainage is essential on poorly drained agricultural fields to provide optimum air and salt environments in the root zone. Crop yields are drastically reduced on poorly drained soils, and, in cases of prolonged waterlogging, plants eventually die due to a lack of oxygen in the root zone. Waterlogging in irrigated regions may result in excess soil salinity, i.e., the accumulation of salts in the plant root zone.
Sources of excess soil water that result in high water tables include: high precipitation in humid regions; surplus irrigation water and canal seepage in the irrigated lands; and artesian pressure. Agricultural drainage is the removal of excess water from the soil surface and/or soil profile of cropland, by either gravity or artificial means. In some soils, the natural drainage processes are sufficient for growth and production of agricultural crops, but in many other soils, artificial drainage is needed for efficient agricultural production.
Agricultural drainage improvement can help reduce the year-to-year variability in crop yield, which helps reduce the risks associated with the production of abundant, high quality, affordable food. Improved access of farm equipment to the field provides more time for field activities, can help extend the crop production season, and helps reduce crop damage at harvest.
Agricultural drainage conditions around the world can be grouped according to three agro-climatic zones: the temperate zone, the arid and semi-arid zone and the humid and sub-humid zone.
In the temperate agro-climatic zone the major role of drainage is to prevent waterlogging, i.e., excess water in the root zone of crops from surplus rainfall.

India, as a party to the Convention on Biological Diversity (CBD), has obliged to document a whole range of organism diversity within her territorial boundaries, make all attempts to conserve these bio-resources and monitor the efficacy of the conservation measures adopted. With its diverse ecological conditions and unique geographical location, Indian landmass supports rich diversity of algal flora. However, this algal wealth needs to be systematically surveyed and documented from all possible habitats. Ecological patterns emerged from recent studies within India are assessed with the identification of knowledge gaps and conservation implications in algal systematics.

During last one decade, great advances have been made in the field of Algology/Phycology throughout the world. Over the years algae has attained a greater reputation and popularity because of its economic importance, particularly as food, for commercial products, water contamination, toxin production, sewage oxidation, municipal water purification in fisheries and above all for the study of fundamental scientific information. But before the algae put in to such important use, it is imperative to have a baseline data about the material in question. Without knowing the status of algal resources of any area one cannot have projections for their utilization or gain knowledge of their ecological role and functions. The taxonomy of algae is, therefore, a prerequisite for all applied fields of algae apart from academic interest. Recent global surveys have revealed that there is lack of knowledge about fresh water algal diversity of tropical countries including India.

The raw material of foremost importance in bakery product is the wheat flour. Bakery units prefer the flour obtained by milling in roller flourmill with 70– 72 percent extraction. Flour quality may be defined as the ability of the flour to produce an attractive end product at competitive cost, under conditions imposed by the end product manufacturing unit. The concept of quality differs from producer and consumer point of view. However, in general, the term quality may refer to fitness of a raw material or a product for a particular process or consumer. Abstract

Microbes are endowed with a high and exploitable potential of being useful associates with their surrounding environment and host in case of symbiotic relationship. Most of the microbes live alone but many of them require association of other living system for its survival. Hence, the beneficial role of microbes is always correlated with growth promotion and survivability of other associated living system. Now it is established that microbes play an important and key role in plant growth and development, even its survivability in case of symbiotic mycorrhizal association with orchids. They are nothing but potential tool protecting plants from different adverse conditions like diseased state, environmental stress like cold temperature, drought, metal contamination, salt and acidic or alkaline stress.

Pulses are important crops in the State of Jammu and Kashmir as they are the only source of protein, an essential part of the vegetative diet. Besides that, pulses enrich the soil fertility by fixing atmospheric nitrogen in the root nodules and improve the soil structure (Thakur et al., 2009). The tap root system explores the deeper soil strata and heavy leaf litter increases the soil organic matter. Pulses in J& K state are ideal crops for mixed and inter-cropping as well as vegetable and fodder crops. It has been estimated that by 2020 the pulse requirement for Jammu region of J&K alone will be 1.51 lakh tonnes (based on average per capita consumption of 68 grams for the projected population of 60.75 lakh) whereas the estimated requirement of J&K state as a whole works out to be 3.85 lakh tonnes (Digest of Statistics 2008-09).

Introduction

The green revolution which initiated in India during 1960’s to 1980’s was an attempt to overcome the then prevailing threats of food scarcity and lack of foreign exchange. The food scarcity was a result of severe drought which engulfed the country as well as the political situation it had to face after its short period of gaining independence (Reddy, 2010). The only way out to overcome the acute food scarcity was intensive agriculture, with the use of high yielding varieties, chemical fertilisers and pesticides which heavily boosted agriculture production in India. The remarkable increase in production and productivity resulted in non-judicious use of chemical inputs to extract the maximum from the degrading soil. This marked the era of soil, water and air pollution and extreme health hazards to all life forms.

Rachel Carson’s “Silent spring” in 1962 was an insight into the path of DDT the then prevalent pesticide through its effect on the food chain as well as the environment. She was one among the scientists to raise her voice against the indiscriminate use of pesticides. The evident impacts raised concerns over the continued use of chemical inputs (Lairon, 2010). The situation warranted the reduced or limited use of chemicals in agriculture which resulted in an “organic movement”. This caused a slow, but evident shift in the interest of growers and consumers towards organic agriculture for health security, food safety, quality and better returns (Niggli et al., 2007).

This review is an attempt to analyse the various factors affecting the safety and quality of organic food products in comparison with conventional food. Drawing a proper conclusion was a difficult task due to the limited availability of scientific papers published in this aspect, indication of only trends rather than solid proofs and non-revelation of non-significant data regarding related experiments. However, this review could evaluate the positive and negative aspects of organic cultivation and food production from the available data, so as to suggest measures for improving the quality and safety of organic food products.

1. Introduction

The gymnosperms constitute a distinct subdivision of spermatophytes, the seed bearing plants. The term ‘gymnosperm’ is derived from Greek words, gymnos, naked and sperma, seed, which indicates that these are naked-seeded plants, i.e., those in which the seeds are not enclosed within the fruits but are borne freely exposed on an open carpel. In contrast in the angiosperms the seeds are enclosed within a closed carpel (ovary). The first known use of the term gymnosperm was given by Theophrastus in 300 BC in his book “Enquiry into Plants” to describe “plants with unprotected seeds”. Goebel (1905) rightly described gymnosperms as “Phanerogams without ovary”. The Scottish botanist, Robert Brown in 1825 first distinguished gymnosperms from angiosperms. At one time they were considered to be single class of seed plants, called Gymnospermae, but taxonomists are now tend to recognise four distinct divisions of extant gymnospermous plants - coniferophyta (Pinophyta), Cycadophyta, Ginkgophyta and Gnetophyta. Geological history reveals that all divisions of gymnosperms have been distinct groups since their origin.

Among the gymnosperms are plants with stems that may barely project above the ground and others develop into the largest trees on the earth. The extant gymnosperms are a small group of plants comprising ca. 1026 species belonging to 83 genera and 12 families (Christenhusz et al. 2011). They are distributed throughout the world, with extensive latitudinal and longitudinal ranges. Economically, gymnosperms are of outstanding value, fulfilling the greater proportion of our timber as well as resin requirements. They are also the dominant forest makers of the world and in addition they play a leading role in the preservation of the environment (Sahni 1990). By far the largest group of living gymnosperms is the conifers (pines, cypresses and relatives), followed by cycads and Gnetales (Gnetum, Ephedra and Welwitschia).

INTRODUCTION

Pear is one of the important fruit crops of temperate regions of India after apple. It is one of the few fruit crops that is adaptable to wide range of climatic conditions. It belongs to genus Pyrus and family Rosaceae, subfamily Pomoideae. The pear belong to three categories i.e. European pear (Pyrus communis L.), Japanese or Asian pear (Pyrus pyrifolia (Burm F.) Nakai, var. Culta) and their hybrids (Pyrus communis x Pyrus pyrifolia) are grown commercially in different parts of the country. Asian or Japanese pears are crisp and juicy with some having apple like flavour. European pears are very soft and have melting texture. Japanese pear has gained importance as a commercial crop in Northern India. The area under this pear has been increasing due to its high yield potential and good economic returns.

Climate is the primary determinant of agricultural productivity. Plant systems, and hence crop yields, are influenced by many environmental factors such as moisture and temperature, may act either synergistically or antagonistically with other factors in determining yields (Waggoner, 1983). In the recent years, climatic change/variability is a biggest challenging factor that affects agriculture in India and elsewhere and concern has been expressed by world community regarding the potential effects of climate change on agricultural productivity. Climate change is expected to influence crop production, hydrologic balances, input supplies and other components of agricultural systems. Agricultural systems are managed ecosystems. The climate change induced atmospheric stress will be the primary cause of crop loss worldwide, reducing average yields for most major crop plants. Environmental stresses such as erratic and insufficient rainfall, extreme temperatures, salinity, alkalinity, acidity, heavy metal toxicity, oxidative stress and others limit yield and productivity of many cultivated crop plants. Drought, extreme temperatures and oxidative stress are interconnected and affect the water relations of a plant on the cellular as well as whole plant level causing specific as well as unspecific reactions (Beck et al., 2007). This leads to a series of morphological, physiological, biochemical and molecular changes that adversely affect plant growth and productivity (Wang et al., 2001).

It has been found that at the household level the health of female members in any family suffers to a large extent. It could be encountered to low health care, poor housing or/and environmental conditions. Due to malnutrition it affects the health to such an extent that it gives rise to many diseases. For a sustainable nutritional status food and various aspects of health needs attention. Looking into that, nutrition is directly related to the health status. For food and nutrition security it is vital to see the availability, accessibility and utilization of food. The World Food Programme (WFP) developed the Vulnerability Analysis and Mapping (VAM) project to analyse the vulnerability to food insecurity of target populations. A prominent part of VAM is related to food access. The demographic and Health Survey (DHS), funded by USAID, provides health data for many countries to help them design their national policy. FAO has developed the Global Information Early Warning System (GIEWS), which collects data related to temporary food insecurity. Under the leadership of WHO, several health surveillance systems have been developed and implemented to monitor the epidemiology of various forms of malnutrition and of selected diseases. At the meso or sub-national level, food market surveys provide data on the availability of food. Agricultural production surveys, intra-household food frequency interviews, immunization surveys and anthropometric surveys of children under five can be used to assess the availability, accessibility and utilization of food and its stability at micro level. Most common Food and Nutrition Security (FNS) indicators at different social and administrative levels depends on the supply and demand. To determine the national situation of food availability data on the production of different food commodities, fertility rate and the trends in internal population needs to be seen. Food prices and per capita food consumption are indicators for national food accessibility. The rates of stunting, wasting and underweight in children, low Body Mass Index (BMI) in adults and low birth weight are FNS impact indicators that designate the extent to which food is adequately being used, utilized and converted into a satisfactory national nutrition situation. Millets are highly nutritious and play a significant role in many people’s diets around the world. They have traditionally been transformed into a range of products through fermentation and malting for centuries. In the era of sustainable development, we still lag in using millets as a primary source of nutrition even after knowing that they are rich in terms of nutrition and other essential elements as compared to cereals. Today we have lots of information regarding different millets; nutrition content, methods of preservation, fermentation, malting, its products etc. Foods made from millet are regarded as potential prebiotics because they can improve the availability or functionality of probiotics, which has major positive effects on health. Foods have been fermented in order to enhance their flavor, texture and palatability. Although fermentation can result in a variety of products, the most prevalent ones are ethanol, lactic acid, carbon dioxide and hydrogen gas (H2 ). Commercial applications for these materials include use in food, vitamins, medications and industrial chemicals. Additionally, fermentation increases the amount of protein present, improves the accessibility of carbohydrates and reduces antinutritional components like tannin and phytic acid. Even though it has some drawbacks, such as the potential for contamination with dangerous microbes, fermentation technology is proven to enhance the nutritional quality of food products. This chapter covers the millet fermentation technology’s effects on the nutritional composition of the millets, contemporary developments in fermented millet-based products and technological improvements examined in the millet fermentation technology.
