Salmonella consists of bacilli leading to Enteric fever, Gastroenteritis, Speticaemia etc. The important member of the genus is Salmonella typhi, which causes Typhoid fever. Salmonella are of two groups;
(i) Enteric fever group consisting of typhoid & Paratyphoid bacilli exclusively or primary human parasites
(ii) Food poisoning group, which are animal parasite but may infect humans causing gastrointestinal infections Salmonella is oxidase negative, catalase positive, indole and Voges Proskauer (VP) negative, methyl red and Simmons citrate positive, H₂S producing andurea negative.
Characteristics
Cells are rod-shaped, non-spore-forming, and predominantly motile by means of peritrichous flagella with diameters of around 0.7-1.5μm and lengths of 2-5μm with a few exceptions. On blood agar, colonies are 2-3mm in diameter. Colonies are generally lactose non-fermenters. They obtain their energy from oxidation and reduction reactions using organic sources, and are facultative anaerobes. They produce acid from glucose usually with the production of gas, and are oxidase negative. Most produce hydrogen sulphide except Salmonella paratyphi A and Salmonella typhi, which is a weak producer. They are identified
with a combination of serological and biochemical tests. Salmonella species are classified and identified into serotypes according to the White-Kauffmann-Le Minor scheme; there are more than 2,500 Salmonella
serotypes that have been described and reported.

Pasteurella and Mannheimia species are small (0.2 x 1-2 μm) non-motile, Gramnegative rods or coccobacilli. They are oxidase-positive facultative anaerobes, and most species are catalase-positive. Although non-enriched media will support their growth, these organisms grow best on media supplemented with blood or serum. They usually remain viable for only a few days on culture plates.
Some species, such as Mannheimia haemolytica, Pasteurella trehalosi and P. aerogenes can tolerate the bile salts in MacConkey agar. In smears from infected tissues stained by the Giemsa method, pasteurellae exhibit bipolar staining.
The family Pasteurellaceae comprises five genera, Actinobacillus, Haemophilus, Mannheimia, Pasteurella and Lonepinella. These genera share a number of common features and some organisms have been reclassified within these genera following deoxyribonucleic acid hybridization studies and 16s rRNA sequencing.
The pasteurellae are small (0. 2 μm by up to 2.0 μm), Gram-negative rods or coccobacilli. They are nonmotile,non-sporing, facultatively anaerobic, fermentative(except for P. anatipesrijer), oxidase-positive andcatalase - positive (except for P. caballi). Althoughunenriched media support their growth, they grow beston media supplemented with serum or blood.

Novel genomic technologies, including CRISPRCas9 gene editing, marker-assisted selection (MAS), and next-generation sequencing (NGS), have revolutionized our understanding of host-pathogen interactions and accelerated the development of resistant cultivars. RNA interference (RNAi) technology has emerged as a promising tool for targeted pest control, while transcriptomics and proteomics approaches have helped identify key resistance genes and defense-related proteins. Bovine mastitis, predominantly a bacterial disease continues to threaten the dairy sector as it inflicts great economic losses to the dairy farmers. The disease caused by more than 200 species of bacteria is characterized by inflammation of the mammary gland with physical and chemical changes in the milk and pathological changes in the glandular tissue. There is a significant reduction in the milk yield and many times it’s accompanied with abnormalities in the udder, milk and the cow. In addition to this, milk from affected animals may harbor the organisms which are potentially pathogenic to humans. Use of antibiotics is a common practice to cure mastitis.

The control of external parasites and the pertinent disease vectors using chemicals is riddled with various issues and hence there is a huge demand for alternative approaches. Natural products, being a prominent resource for poor farmers, can majorly serve as a cheaper, environment friendly and sustainable alternative. Further, ethno-veterinary and traditional knowledge has provided a diverse array of plants, which need to be validated for their repellent, insecticidal and acaricidal activities to claim their effect against external parasites. Besides, phytochemical study of these therapeutic plants has progressively revealed the existence of a variety of bioactive components in these plant derived extracts, catering to their efficacy against external parasites.
External Parasites in Domestic Animals
External parasites, also known as ectoparasites are organisms that live on the surface of domestic animals, feeding on their blood or skin. Fleas, ticks, mites, lice and flies are among the most common external parasites. These parasites can cause significant health issues in animals including discomfort, skin irritation and even severe diseases. Infestations can lead to conditions such as dermatitis, anemia and secondary infections. Moreover, many external parasites are vectors for serious diseases that can affect both animals and humans. Wound in Domestic Animals
A wound is defined as a break in the continuity of the skin, mucous membrane, or tissue surface that can result from physical, chemical, or biological agents. India has a diverse variety of livestock breeds, extensive countryside with vast grazing lands, and widespread use of livestock. The significant population of stray animals, including dogs, cats, and cattle, as well as the increase in pet ownership, make wounds in animals a commonly encountered condition. Wounds in animals can be a frustrating issue for both pets and productive animals, and this can also be a challenge for their owners. For instance, bleeding at the wound site from sudden cuts and bites can cause panic and distress among animal owners. Wounds can become complicated, as animals may lick, scratch, or otherwise irritate them, leading to infections, especially when they are soiled. Additionally, fly infestation and maggots, common in various temperate regions of India, further complicate the wound healing process. An unattended wound can quickly escalate to a severe microbial infection, which may lead to septicemia, maggot infestation, and can even become fatal for the animal. The cost of treating wounds in production animals, including expenses for antibiotics, can impose an economic burden on farmers. Common causes of wounds in domestic animals include penetrating injuries from horns, stamping injuries caused by mothers or other adult animals in tightly packed barns, tightened nose ropes, barbed wire injuries at the brisket region (in horses and cattle), and wet sores on the inner surfaces of the shoulder and groin in cattle due to friction and lack of air and sunlight exposure.

Fish, a vital source of nutrition globally, faces challenges in maintaining microbiological safety and sensory quality due to its perishable nature. While effective in microbial reduction, traditional thermal processing methods often compromise fish’s nutritional and sensory attributes. In response, non-thermal technologies such as High Pressure Processing (HPP), Ultrasound (US), Ozone, and Pulsed Light (PL) have emerged as promising alternatives. These technologies offer effective microbial control while preserving the sensory and nutritional integrity of fish products. Ultrasound processing, has shown efficacy in microbial inactivation and quality enhancement without significant thermal impact. Studies on oily and white fish varieties demonstrate its capability to reduce microbial load while enhancing specific sensory attributes. In the same way, Ozone, which is known for its durable oxidative qualities, is useful in eliminating a wide range of bacteria on fish surfaces, although it must be taken into account when considering penetration depth and any sensory effects. Pulsed Light (PL) has shown quick microbial inactivation on fish surfaces and packaging materials by using high-intensity, short-duration pulses over a wide spectrum. High Pressure Processing (HPP) has become a reliable technique for increasing shelf life and guaranteeing microbiological safety in a variety of fish species. It works at moderate temperatures and high pressures. This chapter reviews the principles, applications, strengths, and limitations of these advanced non-thermal techniques in fish processing. 17.1 Introduction
The most important device that helps or supports the silkworms (larvae) for comfortable spinning their cocoon is called cocoonage or mountage. It determines both the quality and quantity of the cocoons. Different types of
cocoonages are used in different parts of India. In general, these are made of wood, bamboo, cardboard, plastic, grass, dry leaves, twigs, etc.
Mounting is an essential step in the rearing of silkworm. Mounting indicates the transition of silkworm from larval stage to pupal stage where it prepares to spin cocoons. Mounting is a process where fully grown (specifically 5th instar) silkworm larvae are picked and mounted in a suitable place (mountage) where it is about to spin. Mounting is a pivotal phase in silkworm rearing.

There are three different ways to reel in raw silk: (1) directly on a standard-sized reel, (2) indirectly on small reels, and (3) by using a re-reeling machine to transfer the reeled silk from small reels onto standard-sized reels. An efficient reeler willhold onto the predefined number of cocoons per end in order to produce silk with a consistent denier Some techniques are used in reeling. Different reeling mechanisms are used for different purposes.
20.2 Various Silk Reeling Devices
20.2.1 Hand Spinning Wheel
Using a simple spinning method, two hands run the apparatus to remove silk thread from cocoons: one hand turns the wheel while the other feeds the cocoons. In one of the devices, the cocoons are cooked, while in the other, reeling thread is wound onto each wheel. symptoms, and nutritional management strategies.
1. Sodium disorders
Sodium is the primary extracellular cation and is crucial for maintaining osmotic pressure, fluid balance, and nerve signal transmission.
a) Hyponatremia (Sodium deficiency)
Causes
1. Dietary deficiency: Inadequate sodium in feed or water.
2. Excessive loss: Through sweat, diarrhea, vomiting, or prolonged lactation.
3. Dilutional hyponatremia: Excessive water intake diluting sodium levels.

Sensor-based technologies have emerged as a game-changer in the detection and management of metabolic diseases in dairy animals. These tools provide continuous monitoring, early detection, and real-time insights, enabling better health management and increased productivity. This chapter explores the most promising sensor-based technologies used for diagnosing metabolic diseases in dairy animals, their applications, and the future of sensor-driven animal health management.
Metabolic diseases like ketosis, milk fever (hypocalcemia), acidosis, and displaced abomasum significantly impact dairy productivity and animal welfare. Early detection is critical for reducing treatment costs, improvingrecovery rates, and minimizing production losses. Traditional diagnostic methods are accurate and often invasive, time-consuming, and not feasible for large-scale monitoring. Therefore, sensor-based technologies offer a solution by enabling continuous and non-invasive monitoring of physiological and biochemical parameters.

Introduction
Water is an essential and irreplaceable environmental resource, fundamental to the survival of diverse living organisms on Earth. Covering approximately 70% of the planet’s surface, water is categorized into freshwater, marine and saline water. The freshwater system is further divided into lentic (e.g., lakes and ponds) and lotic (e.g., streams, rivers and springs), which serve as crucial sources for meeting daily human water needs (Mishra et al., 2015, 2016). Presently, water quality is influenced by both natural and human-induced factors, including climate conditions, irrigation practices, topography and geological features (Harman et al., 2012). Key physicochemical properties— such as temperature, dissolved oxygen, pH, transparency, conductivity and water current—along with chemical parameters like nitrates, phosphates, heavy metals and organic matter, play a vital role in evaluating the effects ofpollution on water quality (Awasthi and Tiwari, 2004).
Upto pollution has become a major global challenge, driven by rapid industrialization, population growth and urban expansion (Bijekar et al.,2022). The release of untreated or insufficiently treated wastewater into natural water bodies raises serious environmental and public health concerns (Akpor and Muchie, 2011). Wastewater contains diverse pollutants, including heavy metals, organic compounds, pathogens, pharmaceuticals and microplastics, all of which pose significant threats to aquatic ecosystems and human well-being. Conventional treatment methods such as sedimentation, filtration and chemical treatments often fail to effectively remove emerging contaminants and achieve complete purification. Additionally, these traditional techniques can be costly, energy-intensive and may generate secondary pollutants requiring further treatment. In response, the demand for more efficient, sustainable and costeffective wastewater treatment solutions has fuelled research into advanced technologies like nanotechnology (Palit et al., 2023).

A. Viruses: Structure and Characteristics
What is a Virus?
A virus is an infectious agent composed primarily of nucleic acid (either DNA or RNA) enclosed in a protein coat called a capsid. In some cases, viruses may also have an outer lipid membrane or envelope. Plant viruses are much smaller than bacteria and fungi, and they lack the cellular structures necessary for independent life. They can only replicate by hijacking the host cell’s machinery.
Structure of Viruses
1. Nucleic Acid: This is the genetic material of the virus, which can be either RNA or DNA, and it carries the instructions for making new virus particles. Plant viruses are mostly RNA viruses, though some DNA viruses also exist.
2. Capsid: The protein shell that encloses and protects the nucleic acid. The capsid is made of protein subunits called capsomeres and can take various shapes, such as rod-like (rigid or flexible) or spherical.
3. Envelope: Some plant viruses may have an outer lipid envelope derived from the host cell’s membrane, which provides additional protection.

Allium vegetables, which include onions, garlic, and shallots, are a fundamental part of Indian cuisine and play a vital role in the country’s agricultural sector (Fig. 7.1). Here’s an overview of their importance, area, and production in India:
• India is the second-largest producer of onions in the world, accounting for over 20% of global production. Onions are grown across various states, with Maharashtra, Madhya Pradesh, and Karnataka being the top producers. The country produces over 19 million tons of onions annually, with a significant portion being consumed domestically.
• Garlic is another essential Allium crop in India, with the country producing around 1.4 million tons annually. The major garlic-producing states in India are Madhya Pradesh, Gujarat, and Maharashtra.
• Shallots are also grown in India, particularly in the states of Maharashtra, Gujarat, and Tamil Nadu. The country produces around 0.7 million tons of shallots annually.
• The importance of Allium vegetables in India extends beyond their culinary uses. They are a significant source of income for millions of farmers across the country. The Allium crop industry also provides employment opportunities in rural areas, contributing to the country’s economic growth.
