Introduction

Water preceded all forms of life on earth and is believed to be the very origin of all organic life forms. For ages water was forming oceans, separating landmasses and shaping the terrain. It further influenced the emerging atmosphere of the young planet. The first organism formed and began to evolve in the primeval oceans. Mankind entered into the scene several million years later. The history is rather too long and infinitely complex. Variety of models with different degrees of certitude and consensus attempt to cogently explain what could have happened. But in spite of all the differences on the course of evolution, there is a universal consensus that water played a decisive role in the changes.

Across the globe, mankind managed to establish different civilizations with dissimilar cultural and material advancements much later. But then invariably all civilizations considered water holy and water bodies were sacred places. Holy wells, springs, rivers, cenotaphs were held in awe all through human history. The mysterious properties of water are studied from time immemorial. And water indeed is a strange compound! Availability of water for consumption and agriculture has determined the zenith and nadir of surviving and extinct civilizations.

Ancient Indian temples as part of design, have a prominent sacred well or a pond with an associated purana/myth narrating the mystical properties of the theertha / waterbody. It is still is a living tradition. In the west wishing wells survive from remote antiquity.

Entomology is the science, which deals with study of arthropods which parasitize or affect the domesticated animals. Since these arthropods can cause damage or injury to their host by several ways, thorough understanding of the subject is very essential. Most of these arthropods are ectoparasites living on the body of the host or at the most in subcutaneous tissues while very few are endoparasites, living inside the body of the host. Similarly, most of the arthropods are temporary parasites, while very few like lice and mites are permanent parasites. Arthropods comprise of more than 80% of living creatures on earth.

Harmful Effects Caused by Arthropods to the Body of the Host

1. Injury to the skin: Most of the arthropods have biting tendency and cause injury to the skin by bites. As a result, micro-wounds are produced on the body which may later on be infected with bacteria leading to localised or generalised pyoderma condition or pyodermatic patches. Similarly, such wounds are predisposed to attack of blow flies which cause a condition called as “Blow fly myiasis.” Animals in order to escape the attack of flies try to run all around leading to phenomenon known as “Entomophobia”.

2. Blood sucking Habits: Most of the arthropods have blood sucking tendency like mosquitoes and ticks which may lead to anaemia.

3. Release toxins: Few of the arthropods release poisonous substances while biting. They inject certain poisons and toxins in the body of host. Eg. Some species of ticks release toxins causing paralysis in host known as tick paralysis.

4. Transmission of diseases: Arthropods have ability to transmit various bacterial, viral, protozoal, helminthic and mycotic pathogens. While sucking blood, they collect infective stages of the organism and while biting to the other host, they transmit the pathogens.

In modern agriculture, use of synthetic chemical fertilizers are essential in agriculture for sustainable yield but, these have resulted in environmental pollution. The use of synthetic fertilizer could result in serious human health issues and also affects the soil microflora, besides being costly due to high production cost. Further, excess use affects soil processes and result in nutrient imbalances in plants with increased susceptibility to pests and diseases and also affects the symbiotic associations. Under these circumstances, biofertilizers could be an alternative for integrated nutrient management system in horticulture. The entire crop production system depends on soil beneficial microflora and their activities, which makes them highly potential alternatives to synthetic chemical fertilizers.

Biofertilizers or microbial fertilizers are essential for eco-friendly and sustainable cultural practices. The term “biofertiliser” has been defined in several ways due to its unique relationships between the plant and rhizosphere microflora. Biofertilizers mainly include nitrogen fixing bacteria, phosphate solublizing and potash solubiling bacteria.

As global climate change becomes an increasingly urgent concern, the search for sustainable and renewable energy sources has intensified. Among the alternatives to fossil fuels, biofuels have emerged as a promising solution due to their potential to reduce greenhouse gas emissions and dependence on petroleum. Biofuels are derived from organic matter, such as crops, agricultural residues and other biomass, which can be converted into energy sources like ethanol, biodiesel, and biogas. For instance, crops like corn and soybeans contain oil extracts that can be processed into biofuels, offering a renewable and environmentally friendly alternative to traditional fossil fuels (Demirbas, 2009). However, the potential of biofuels extends beyond these conventional sources, as researchers explore a wide range of organic materials that can be sustainably regrown and harvested, minimizing ecological impacts (Naik et al., 2010). Biofuels have gained significant importance in both developed and developing economies, driven by their potential to enhance energy security and reduce carbon footprints. In 2023, the United States led global biofuel production with 15,550 million gallons, followed by Brazil with 8,260 million gallons. India ranked third, producing 1,430 million gallons of bioethanol and achieving an E11.7 blend rate during the 2022–2023 period. This blend was sourced from various feedstocks, including sugarcane juice (5%), cane molasses (5%), and damaged food grains (DFG) (1.7%). Historically, India’s ethanol production has relied heavily on sugarcane molasses, but the National Biofuel Policy (NBP) of 2018 has been instrumental in promoting the use of biofuels to reduce fossil fuel dependence, mitigate greenhouse gas emissions, and strengthen energy security (Ministry of Petroleum and Natural Gas, 2018). India, the third-largest energy-consuming nation globally, faces considerable challenges due to its heavy dependence on imported oil, posing risks to both economic stability and strategic security. With its share of global energy consumption projected to double by 2050, the country is actively seeking domestic alternatives to curb this reliance. The population pressure, economic expansion, and dietary changes have all led to the rise in demand for foods with animal origin. On the other hand, the fishing industry has a lot of opportunity to close the supply and demand imbalance. The average global per capita consumption has climbed to 20.3 kg, with Asia accounting for about 91.6% of the world's supply of aquaculture fish. Most of this fish is consumed domestically (FAO, 2022). India produced 14.16 million tonnes of fish in 2019-20. Across the region, per capita consumption varies significantly ranging from 63 kg/year in the case of Japan (Delgado et al. 2003) to only 5-6 kg/year in India where only one-third of the population are f ish-eaters (Dey et al. 2005). As you know fish consumption rate is increasing day by day because it contains high protein, Omega-3 polyunsaturated fatty acids {Docosahexaenoic acid (DHA) and Eicosapentaenoic acid (EPA)} which is expected to have huge health benefits. Although the supply and demand for different species vary, the Indian major carp (IMC) predominates in satisfying the nation's demand for fish. With a diverse population of around 1.3 billion to feed, knowledge of demand and supply is necessary especially in fisheries sector. Since, fish is a perishable commodity its supplying is a tough task to accomplish. Before studying the demand and supply firstly we have to focus on what is ‘Need’ and ‘Want’.

The characteristics of bacteria used in the study and identification of bacteria depend upon the behavior of populations or cultures rather than of individual organisms. Nutrient materials provided in a form, suitable for growth, are known as culture media. A Growth Media or culture medium is a liquid or gel designed to support the growth of microorganisms or cells.
I. Types of Culture Media
Different types of culture media may be used for cultivation of microorganisms such as liquid, solid and semi-solid.
i) Liquid Culture Media: Includes nutrient broth, Glucose broth, litmus milk etc. these media are used for the preparation of large number of microorganisms, fermentation studies and various other tests.
ii) Solid Media: A little agar, gelatin or silica gel; is added to a liquid medium to impart a degree of firmness to it. Nutrient agar, Blood agar, etc. are examples of solid media that are used for developing surface colony growth of bacteria and mold.
iii) Agar Slant Media: Test tubes or small bottles containing about 5ml. of solid medium, e.g. nutrient agar, dissolved and allowed to cool in a sloping position.
iv) Stab Media: Tubes or bottles containing agar medium are allowed to solidify in the upright position.
v) Semi solid Media: These are more jelly like due to lower percentage of the solidifiers. These media are particularly used for determining motility of bacteria.

An entrepreneur is an economic man who seeks to maximize revenues by identifying and adopting innovations. Starting from the basics, etymologically, the word entrepreneur comes from the French word “entreprendre”, which means “to do something”, and, in the Middle Era, it was originally used in the sense of a person who is active, who gets things done. The study of entrepreneurship reaches back to work in the late 17^th and early 18^th centuries of Irish-French economist Richard Cantillon. “Entrepreneur” is a French word that first appeared in the French dictionary entitled Dictionnaire Universel de Commerce, compiled by Jacques des Bruslons and published in 1723. Richard Cantillon’s 1755 work “Essai sur la nature du commerce en general” changed the entrepreneurial concept. Risk has been used to identify entrepreneurs since ancient times. Forest resources usually provide the raw materials for homes, workplaces, the books and newspapers, and the packaging that contains food and other products of our labor. Forest ecosystems supply our water, maintain our climate, and help purify the air, protect soils, and provide for wilderness experiences. Forests provide habitat for wildlife, and serve as preserves of biological diversity. Forests are sources of food, fuel and medicine for people all over the world. Forests shape the recreational landscape, help stabilize our farms, and enhance our cities.

About 30 per cent of the world’s total land areas are covered by forest with the area of 3.9 billion hectares. Nearly 47 percent of the world’s forests are in the tropics, 33 percent in the boreal zone, 11 percent in the temperate zones, and 9 percent in sub-tropical areas. The 94 million hectares of forest lost over the ten-year period, represented about 2 per cent of the world’s total forest cover, or an area larger than Venezuela. Two thirds of the world’s forests are located in ten countries: the Russian Federation, Brazil, Canada, the United States, China, Australia, the Democratic Republic of the Congo, Indonesia, Angola and Peru. Most of the deforestation work was performed in natural tropical forests, which lost 14.2 million hectares a year over the last decade. Africa and South America have suffered the most deforestation.

Africa was the region with the highest deforestation in the world, which lost 5.3 million hectares of forest per year in the 1990s. Forests are a major factor in the climate change issue. Forest ecosystems contain more than half of all terrestrial carbon, and account for about 80 per cent of the exchange of carbon between terrestrial ecosystems and the atmosphere. Deforestation in the 1980s may have accounted for a quarter of all human-induced carbon emissions, the second greatest emitter after fossil fuels. Forest plantations comprise 5 percent of the world’s forests. Asia has the largest area of plantations, accounting for 62 per cent of the world total. China accounts for 24 percent of that total and India, 18 per cent. Plantations supply about 35 percent of the world’s round wood. The area of forest plantations increased by an average of 3 to 4 million hectares per year during the 1990s. Half of this increase was the result of afforestation on land previously under non-forest land use, whereas the other half resulted from conversion of natural forest. There are reports that 12 percent of the world’s forests, or about 480 million hectares, are in protected areas.

The fish farmers do more than just contribute to local food supplies; they also provide money and work for people locally. However, the fish and fisheries sector of Kashmir is faced with various challenges. The challenges range from overfishing, Exclusively Distributed by NIPA GENX Electronic Resources and Solution Pvt. Ltd. New Delhi environmental degradation, and pollution to the lack of infrastructure for fish handling and processing and climatic change. Despite all odds against this sector, the government and other agencies/organizations are trying their best to achieve sustainable management and development of fisheries in Kashmir. Moreover, full- and part-time work by fish farmers and fish workers, seasonal or occasional, supplement thousands of livelihoods with additional income in the sector's activities (Qayoom and Bhat, 2015). Most of those engaged in small-scale fisheries and aquaculture in Kashmir are self-employed, hence directly contributing towards food security within their households and communities. Due to the ever-increasing demand for protein-rich food, the production of fish has elevated around the world. According to the Food and Agriculture Organization, fish production attained 179.2 million metric tons in 2020, which is valued at USD 345 billion (FAO, 2020). This shows a large increase from the years of the 1990s when world fish production was 100 million metric tons.
Fish Production of India
Trends in fish production of India indicate a continuous rise of an annual average growth rate of 8.61% over the period from 2014-15 to 2021-22 (dof. gov.in). It is due to inland fisheries, which contributes around 75 percent of the total fish production in the year 2021-22, while the remaining 25 percent is from marine fisheries (dof.gov.in). Value-wise, the country's fish production has also had a massive outflow in exports, touching US$ 8.09 billion in FY 2022-23 (Handbook of fisheries statistics, 2023).

Fish and shellfish seed rearing, a crucial branch of aquaculture, involves the controlled breeding, nurturing, and development of aquatic organisms—primarily fish and shellfish—from their earliest life stages. This process ensures a sustainable and reliable supply of high-quality aquatic seed stock, especially vital in regions facing declining wild fisheries.
Seed rearing acts as the intermediate stage between hatching and grow-out. It focuses on the careful management of larvae or juveniles until they grow large enough to be transferred to grow-out systems such as ponds, cages, or pens. The main goal is to enhance survival rates, promote healthy growth, and produce robust fry or post-larvae that can thrive in commercial farming conditions.
In aquaculture terminology, “seed” refers to young aquatic organisms—fish fry, fingerlings, or shellfish post-larvae—sourced either from hatcheries or natural environments. These early-stage organisms are highly vulnerable to environmental changes and disease, requiring meticulous care. Success during this stage depends on optimal nutrition, water quality control, and disease management.
The seed rearing process typically begins shortly after hatching. For fish, stages include yolk-sac larvae, free-swimming larvae, fry, and fingerlings. For shellfish such as shrimp, development proceeds through nauplii, zoea, mysis, and post-larvae stages. Each phase demands close attention to water parameters like temperature, salinity, oxygen levels, and hygiene.
Seed rearing can take place in a variety of systems—indoor tanks, nursery ponds, hapa nets, or specialized seed rearing facilities—depending on the species and production scale. In India and other tropical regions, both extensive systems (natural feed-based) and intensive systems (involving formulated feeds and aeration) are widely practiced. Innovations such as biofloc technology, probiotics, and recirculating aquaculture systems (RAS) have significantly improved outcomes.

Fish nutrition is a key component of aquaculture, as it directly affects the growth, health, reproduction, and overall efficiency of farmed species. Unlike land animals, fish primarily obtain their energy from proteins and fats, making their dietary needs distinct and specific to each species. With the expansion of aquaculture and rising demand for high-quality fish protein, ensuring nutritionally balanced diets for fish has become increasingly important. Fish require both macronutrients—proteins, fats, and carbohydrates—and micronutrients, including essential vitamins and minerals. Proteins are especially important for tissue building and enzymatic functions, while fats provide energy and vital fatty acids needed for cell membranes and hormone synthesis. Fish pathology is a specialized area within veterinary and aquatic sciences that focuses on understanding diseases affecting fish—their origins, progression, effects, and methods of control. With aquaculture playing an increasingly critical role in meeting global protein demands, maintaining fish health is essential for the long-term viability and efficiency of aquatic farming. Like other animals, fish are prone to numerous diseases caused by a variety of pathogens, which can impact both wild and farmed species, leading to serious economic, ecological, and health issues.
The field draws on various disciplines, including parasitology, immunology, microbiology, histopathology, and molecular biology, to study disease mechanisms and how fish interact with infectious agents. Disease outbreaks in fish may stem from infections, poor environmental conditions, overcrowding, or insufficient nutrition. Among these, infectious diseases pose the greatest threat, caused by viruses, bacteria, fungi, and parasites, each differing in severity, transmission methods, and environmental resistance.
Viral infections, such as those from IHNV or KHV, can rapidly spread and cause high death rates, particularly in hatchery environments where treatment options are limited. Bacterial diseases, triggered by agents like Aeromonas hydrophila, Vibrio anguillarum, or Edwardsiella tarda, often enter through damaged skin or gills, causing ulcers, bleeding, and internal organ damage. Fungal diseases, like those caused by Saprolegnia, are usually secondary infections that develop when fish are already weakened. These fungi attack the skin and gills, forming cottonlike lesions and damaging tissue.

In broad perspective, forages are plants and crops used for animal feeding. It includes all the natural and cultivated crops, shrubs, and trees etc., used in livestock feeding. Here, fodder specifically denotes the cultivated crops exclusively used for livestock feeding. Though, they are synonymously used in books, a student of veterinary science should able understand the difference between forages and fodder. Fodder is a term mainly used in intensive livestock farming where stall feeding is preferred over grazing to optimize the efficiency of production per unit area. Though, most of the tree's leaves are used for animal feeding, some of the trees being cultivated exclusively for animal feeding and those are called fodder trees and others called as multipurpose trees.

Food preservation involves treating and safely handling food to prevent or delay spoilage while retaining colour, texture, flavour and nutritional value. Food deterioration may result from microbial growth, indigenous enzymes, oxidation, physical damage, insects, moisture, temperature and other environmental conditions. Bacteria, fungi and other microorganisms contaminate food through soil, water, air and biological sources. The effectiveness of preservation therefore depends on controlling intrinsic factors such as pH, water activity, nutrients and redox potential, together with extrinsic factors such as temperature, humidity and storage atmosphere. Understanding these mechanisms provides the scientific foundation for selecting safe and effective preservation methods.

Food processing is a fundamental component of the food industry that transforms raw materials of plant and animal origin into safe, nutritious, convenient and value-added products. This chapter introduces the basic concepts and evolution of food processing, tracing its development from traditional practices to modern technologies driven by consumer demand. It explains the major purposes of processing, including shelf-life extension, food variety, safety and preservation of nutritive value. Food safety and hygiene has been an age-old concern. However, today it has become an important aspect due to the rise in foodborne illnesses for the past few decades globally. It is estimated by WHO that annually 600 million suffer from foodborne diseases as a result of unsafe food consumption while 4,20,000 deaths are recorded globally.

Food Science is one of the ancient sciences and the genesis originates to the very beginning of human civilization. The advent of food science was associated with practice and observation by humans before establishment of scientific concepts. The ancient man knew that roasting or smoking of meat improves the edible quality and digestibility. As a consequence, he started practicing the same much before the reasons for the same could be established. Many of the modern preservation concepts had their origin in prehistoric period itself as humans could use techniques such as dehydration, fermentation and pickling to their advantage to improve the sensory attributes of the products and also to enhance their shelf life. Humans during the Pre-Neolithic period about 2,50,000 years before used fire for cooking meat. During the Paleolithic period humans not only roasted food but also developed grinding, pounding and drying. During the Mesolithic era, humans were desperate for food and got involved in extensive hunting and fishing. During the same time domestication of animals took place and animal husbandry became a reality (Stewart and Amerine 1982). The Neolithic period made qualitative changes in the food habits of humans and they changed from a food gathering and hunting society to one of food production (Heizer and Elsasser 1980).

Introduction

A geographic information system or geographical information system (GIS) is a system designed to capture, store, manipulate, analyze, manage, and present all types of spatial or geographical data. The acronym GIS is sometimes used for geographic information science (GIScience) to refer to the academic discipline that studies geographic information systems and is a large domain within the broader academic discipline of geoinformatics. What goes beyond a GIS is a spatial data infrastructure, a concept that has no such restrictive boundaries. In a general sense, the term describes any information system that integrates stores, edits, analyzes, shares, and displays geographic information. GIS applications are tools that allow users to create interactive queries (user-created searches), analyze spatial information, edit data in maps, and present the results of all these operations. Geographic information science is the science underlying geographic concepts, applications, and systems.

GIS is a broad term that can refer to a number of different technologies, processes, and methods. It is attached to many operations and has many applications related to engineering, planning, management, transport/logistics, insurance, telecommunications, and business. For that reason, GIS and location intelligence applications can be the foundation for many location-enabled services that rely on analysis and visualization. GIS can relate unrelated information by using location as the key index variable. Locations or extents in the Earth space–time may be recorded as dates/times of occurrence, and x, y, and z coordinates representing, longitude, latitude, and elevation, respectively. All Earth-based spatial–temporal location and extent references should, ideally, be relatable to one another and ultimately to a “real” physical location or extent. The term ‘Horticulture’ is derived from two Latin words, Hortus meaning Garden and Cultura meaning Cultivation. In ancient days the gardens had protected enclosures with high walls or similar structures surrounding the houses. The enclosed places were used to grow fruits, vegetables, flowers and ornamental plants. Horticulture differs from agriculture and forestry in specializing the cultivation of garden crops. The garden crops include fruits, vegetables, flowers, ornamental trees, spices, plantations, medicinal and aromatic plants. Horticultural crops do not give food grains. The products of horticultural crops such as fruits and vegetables are highly perishable so that they are utilized in the fresh state. In general horticultural crops need more intensive cultivation (i.e. need more work) than the agricultural crops.
