18.1. Introduction

Spoiled food is defined as the food that has been damaged or has undergone changes so as to render it undesirable/unacceptable/unfit for human consumption. Spoilage of processed products is mainly caused by the action of micro-organisms and due to the physical or chemical changes. The reasons for microbial spoilage include under- processing, inadequate cooling, contamination from leakage through can seams and pre-process spoilage. In under-processed cans (receiving low heat treatment) large number of micro-organisms is expected to be involved in spoilage.

18.2. Causes of food spoilage

Food spoilage or deterioration may be described as loss of weight, softening, souring, rotting, wilting, moulding or a combination of one or more forms. The major causes of food deterioration are: biotic and abiotic factors.

India is one of the unique countries in the world with great diversity in climate. The annual rainfall varies from about 180 mm in North western part of India to almost 11,777 mm at Cherrapunji in Meghalaya. For a considerable amount of time, Cherrapunji had occupied the position of wettest place in India. However, off late, observations revealed that it is Mawsynram which receives the maximum amount of annual rainfall. Hence, Mawsynram with 11,872 mm annual rainfall is the wettest place in India. Both the places-Mawsynram and Cherrapunji-are located within 16 kilometers from each other in the East Khasi Hills district of Meghalaya. The maximum temperature at Churu in western Rajasthan is 50ºC and the lowest minimum temperature at Leh in Ladakh region is as low as -35ºC. In view of such great diversity in the distribution of rainfall and temperature in the country, it is necessary to have clear understanding on regional, seasonal and diurnal variation in different weather parameters (Fig. 13.1).

Agroforestry systems are not simply systems where trees and crops or animals give useful products to the farmers, rather systems where trees and crops and/ or animals interact. Interaction literally means influence or mutual or reciprocal action. So, component interaction refers to the influence of one component of a system on the performance of other component as well as the system as a whole.

In agroforestry systems, trees are grown in close proximity to crops and pasture. Their performance would largely depend on their ability to share various growth resources in a given environmental situation. Various interactions take place between the woody trees and herbaceous plants (crops or pastures) which is referred to as tree-crop interface. These interactions take place through the media of soil and microclimate and may exert favourable or adverse effects on the crop. Study of interaction helps to know how the components of agroforestry utilize and share the resources of the environment, and how the growth and development of any of the components will influence the others. Interaction occurs both above and below the ground and includes a complex set of interactions relating to radiation exchange, the water balance, nutrient budget and cycling, shelter and other microclimatic modifications.

Ecology of a place is influenced by a number of biotic and abiotic factors. An agroecological zone is broadly homogeneous in climatic and edaphic factors, but not necessarily contiguous, where a specific crop exhibits roughly the same biological expression. On the other hand, the characteristics of an agroecological zone influence the crops and cropping patterns of the zone. Thus, there are considerable variations in the types and management practices of agroforestry systems being followed in different agroecological zones.

AGROFORESTRY FOR HUMID AND SUBHUMID TROPICS

Humid and subhumid tropical regions have much variation in biological, social and economic parameters. The characteristics of humid tropics include high mean annual rainfall of more than 1500 mm, dry season of less than four months in a year and mean annual temperature of more than 22°C. Rainfall usually exceeds the evapotranspiration. However, demographic pressure has caused excessive deforestation and overgrazing which developed soil related problems like low soil fertility, low organic matter, high acidity and high rainfall erosivity. The agroforestry practices designed for this region should aim for improved fallows, soil fertility improvement and conservation, food production, etc. Thus, the common agroforestry systems in this zone are taungya, homegardens, alley cropping, plantation-crop combination, windbreaks, silvipastoral systems and various intercropping systems. Shifting cultivation is a common practice in tropics which should be discouraged as it causes environmental degradation and ecological imbalance, soil erosion and soil nutrient loss.

Universal development through Education for all had been a prominent feature earlier during Millennium Development Goals and recently it has gained a fresh momentum when United Nations General Assembly set 17 inspirational Sustainable development Goals. Quality Education is the focus of SDG 4, “Ensure inclusive and equitable quality education and promote lifelong learning opportunities for all” (Sustainable Development Goals, 2023). Role of education in achieving these sustainable development goals in developing countries is well recognized by OECD. OECD in its report on ‘Education at a Glance 2013’ states that “Educational attainment is frequently used as a measure of human capital and the level of an Individual’s skills. The level of educational attainment is the percentage of population that has reached a certain level of education. Higher levels of educational attainment are strongly associated with higher employment rates” (OECD, 2013). Furthermore, OECD in its report published in 2017 explains that “Making SDG 4 a reality will transform lives around the globe. Education is so central to the achievement of a sustainable, prosperous, and equitable planet that failure to achieve this particular SDG puts at risk the achievement of the 17 SDGs as a Whole” (OECD, 2017).

Libraries have become essential in providing access to electronic resources and promoting lifelong learning due to the emergence of e-learning. E-learning refers to the use of digital technology to access learning materials outside of a traditional classroom setting. E-learning is emerging as a powerful influence in higher education, with a presence on nearly every campus and a growing number of college and university courses. The environment is characterized by growth and dynamism, where fluidity and change are the social, institutional, and technological norms (Mishra & Gupta 2019).

Technology has revolutionized education, turning it into e-learning and internet based learning. This evolution provides individuals with the opportunity to have more freedom, convenience, and the ability to work virtually. Libraries must modify their resources and services to meet the emergence of e-learners. Academic libraries have now established connections with web-based services and e-resources, which are moving the profession forward at a rate never before seen. (Ramkumar & Kannan, 2023)

Early History

Ancient and Medieval Times: Early forms of posters can be traced back to ancient civilizations where announcements and decrees were inscribed on stone tablets and walls. The use of posters as we know them began with the invention of printing technologies.

15th Century: The invention of the printing press by Johannes Gutenberg in the 15th century paved the way for mass production of printed materials, including early forms of posters.

Humans possess an innate tendency to preserve their experiences and knowledge. Throughout evolution, this inclination led to the recording of text and images on materials such as stone, rock, leaves, bark, and eventually paper. The desire to preserve not only written and visual content but also sound culminated in the invention of sound recording in the late 19th century. This innovation enabled humanity to capture and reproduce auditory experiences.

In 1924, Western Electric in the United States developed the first electromagnetic sound recording machine. This device marked a significant advancement, as it allowed for the conversion of acoustic waves into electrical signals that could drive a stylus to inscribe the sounds onto a medium, such as wax records. Over time, the technology evolved, leading to the widespread adoption of electromagnetic recording on plastic tapes coated with materials like ferrous oxide and ferric oxide. The late 20th century saw the introduction of Compact Discs (CDs), followed by DVDs and Blu-ray discs. Today, sound recordings are commonly stored on hard drives, flash drives, and memory cards.

Soil is one of the major platforms on which life sustains. Soil, the product of weathering, covers the earth’s surface. Soil is the medium of plant growth and thus it requires proper attention for better crop yield. The land is the constituent of soil, vegetation, physico-chemical and biological attributes affecting its usages. The soil may act as a sink or source for the elements and other materials. Hence, it requires to understand the various components to facilitate management options for improving the fertility status of soil.

2.0 Soil

The soil is a natural dynamic body on which plant grows. It is a complex mixtures of minerals, water, air, organic matter and microorganisms. Besides, there exist an unconsolidated mineral or organic material on the surface of the earth and thus becomes a natural medium for the growth and nutrition of the plants.

The native and applied organic matter play an important role in terms of nutrient adsorption , nutrient mobility and microbial habitat on soil. The dominant ions present in soil under a particular agro-ecological situation may or may not be available to the growing plants due to the presence of organic matter. The binding energy and the stability of the organo-metal complexation would play an important role in availability of nutrients to the plants. The organo-metal complexation reaction depends on the nature of the ionic species (ionic/non ionic) present in soil. The organic fractions (Humic acid/Fulvic acid) react with metal ions present in soil to form complexes which may be stable or unstable depending upon the molecular arrangement and degree of coiling of humic/fulvic substances. The surface charge density on clay and soil pH also play an important role to determine the order of stability of different nutrients (macro/micro) in soil.

6.1 Introduction

Plum is one of the important and widely cultivated fruit crops of temperate regions of the world. It occupies a unique position amongst the stone fruits in world fruit production and ranks next to peaches in economic importance. Plums are the most taxonomically diverse stone fruits which belongs to genus Prunus of sub-family Prunoideae and family Rosaceae (Potter et al., 2007). There are about 42 species of plum but the cultivated plums are derived from two species namely Prunus domestica (European plum) and Prunus salicina (Japanese plum). The Japanese plums are widely grown in the country whereas the European plums are grown only on a limited scale. The European plums are most often produced for the dried fruit market particularly in France and California, where it is called prune and dried plum, respectively. In the recent past some prunes have been introduced for fresh market in Himachal Pradesh. These prunes are sold fresh like plums and have become quite popular.

Trichoderma is fungus is well adapted to different ecosystem and identified > 250 species for agricultural use. It is primarily used as a bio-fungicide because of the variety of secondary metabolites produced and applied mainly for biocontrol and bioremediation and growth promotion activities. Bio-control potential of Trichoderma used for the control of soil borne diseases through various mechanisms responsible for broad range of cell wall degrading enzymes, anti-microbial and organic volatile compounds produced by Trichoderma. During abiotic stress, Trichoderma play an important role in plant growth promotion through mobilization of various nutrients. Presently Trichoderma is used as an effective biocontrol agent against plant parasitic nematodes. It is also used for one of the alternate remedy for improving the quality of the soil by removing the heavy metal in agricultural field, makes them suitable for cultivation.

Trichoderma is one of the genus of fungus species which belongs to Ascomycetes (Order Hypocreales) present in diverse soil ecosystems, colonise under various agro ecological niches and most of the prevalent are culturable microorganism. They are primarily used as efficient biocontrol agents against a variety of soil-borne plant diseases. However, they have also shown potential in processes like bioremediation, promoting plant growth, and managing nematode populations.

Geographical Indications (GI) are indications or symbols that are affixed to products that possess a specific geographical origin and are known for their unique qualities or reputation. These products can be agricultural, natural, or manufactured goods that are essentially attributed to a particular region, locality, or country where they are produced. According to Article 22.1 of the TRIPS Agreement, GIs identify a good as originating from a specific territory, region, or locality, where a given quality, reputation, or characteristic of the good is essentially attributable to its geographical origin.

GIs are a product of collective tradition and decision-making and continue to evolve. They represent a combination of human effort, culture, land resources, and climatic conditions. GIs are limited to a specific region and are not transferable from one owner or region to another. A product that has a GI tag is associated with a specific geographical area where it is developed, and the GI sign on the product indicates its origin. Products designated with a GI acquire a high reputation and are valuable commercial assets for the geographical region where they originated. However, GIs are also exposed to misappropriation and forgery, and therefore require both national and international protection.

The research setting is an important component of the research methodology. Research setting refers to the detailed information of an area where the study was conducted. The research setting can be seen as the physical, social, and cultural site in which the researcher conducts the study. In qualitative research, the participants are observed in their natural environments with a primary focus on meaning-making. The study area generally consists of a particular geographical area viz. a state, district, block, or gram panchayat area selected according to the benefit of the investigator who possesses adequate knowledge regarding the location, communication facility, the period of study, the availability of resources, etc. of the locality so that he can easily approach every corner of the area for data collection. Additionally, to comprehend people’s knowledge, attitudes, and behaviour more easily, investigators must have a fundamental understanding of their socio-demographic backgrounds. It is the environment within which studies are run that has important consequences for experimental design, the type of data that can be collected and the interpretation of results.

The Review of literature is a critical summary of published academic research and other sources on a particular topic or research question. It involves identifying, analyzing, and synthesizing relevant research studies, books, articles, and other sources to provide a comprehensive overview of what is known and not known about the topic.

A good review of literature should be well-structured, focused, and provide a balanced and objective analysis of the existing literature. The following are the key elements of a literature review:

2. Search Strategy: The search strategy should outline the databases and search terms used to identify relevant literature.

Migration shows the trends of social changes. From the historical viewpoint during the process of industrialisation and economic development, people migrate from farms to industries, from villages to cities, from one city to another and from one country to another. In modern times, technological changes are taking place in Asia, Africa and Latin America due to which these regions are witnessing large-scale migration from rural to urban areas.

Economists are interested in the study of migration because migration affects the supply of skilled and semi-skilled labourers, development of industries and commerce causing changes in the employment structure of the migrated people. Formulation of economic policies has a close relation with the process of migration because migration affects the economic and social development of a country.

Research setting refers to the detailed information of an area where the study was conducted. Artificial Intelligence (AI) is a discipline of computer science that now days affecting evary aspect of day to day life. It has the potential to greatly improve animal breeding programs in India by providing more accurate and efficient selection methods. Some of the avenues and possibilities of using AI in animal breeding in India includes Predictive analytics: AI can be used to develop optimization models that take into account a variety of factors, such as genetics, phenotypic traits, and environmental conditions, to identify the best breeding strategies. AI can be used to analyze large amounts of data on animal genetics, phenotypic traits, and environmental factors to predict the likelihood of an animal producing offspring with desired traits. This can help breeders make more informed decisions about which animals to be selected for breeding. AI algorithms can be trained to accurately identify diseases in animals by analyzing imaging data, such as X-rays and MRI scans, as well as blood and tissue samples which in turn facilitate veterinarians to make more accurate diagnoses, improving treatment outcomes. AI can also improved feed efficiency by analyzing the feed consumption and nutrient utilization data to identify patterns and trends that can be further utilized to improve feed efficiency, reduced feed costs and increased production efficiency.

Introduction

Raising milk and meat production are long-standing global issues. Researchers are learning that present breeding efforts won't be sufficient to meet anticipated future food demands given the current climate scenario. The animals that influence the overall yield of the field must be screened as soon as possible. In order to build more successful modern breeding programmes, high-throughput phenotyping is currently being included into conventional breeding operations. Despite the public accessibility of their genetic information online, there is still a lack of phenotypic data on the genomes of various animal breeds because environmental factors make it more difficult to define phenotypes and increase the likelihood of measurement error (Rahaman et al., 2015). Genomic selection (GS) is a strategy that predicts the genomic estimated breeding values of lines in a breeding population using information from genome-wide markers (Meuwissen et al., 2001). When compared to other conventional methods like marker-assisted selection (MAS), genomic selection has some inherent advantages. These include boosting genetic gain by reducing breeding cycles and acquiring minor effect loci based on markers dispersed throughout the entire target genome. Reliable phenotypes and genotyping are both necessary for the training of accurate prediction models for genomic selection. Phenotyping is regarded as a significant factor restricting genetic improvements in animal breeding due to high labour and time expenditures. Traditional approaches of phenotyping are prohibitively expensive, time-consuming, and slow.

Introduction

Estimated breeding values (EBVs), often estimated for sires, are used in traditional animal breeding (TAB) programmes to make selections based on an animal’s performance and that of its relatives. Using, typically, the best linear unbiased projections, EBVs are calculated using attributes measured in own performance, pedigree, sib, and/or progeny evaluation schemes in specialised testing stations and/or selected farm conditions (BLUP; Henderson, 1975). One of the main time-consuming challenges for phenotypic evaluation to enable a meaningful estimation of breeding values is generation intervals of 4 to 5 years in beef cattle, more than 5 years in dairy cattle, and 2 to 2.5 years in pig breeding schemes (Schefers and Weigel, 2012). Modern breeding techniques like marker-assisted selection (MAS) and, more recently, genomic selection (GS) are based on the use of genetic DNA markers to aid in selection and breeding (Williams, 2005). The fundamental reason why MAS, that only further uses a few markers as a selection tool, hasn’t made as much progress as was initially anticipated is that finding trustworthy markers is challenging, particularly when dealing with complex traits. Only relatively few consistent markers could be identified, despite successful identification of many quantitative trait loci (QTL; Hu and Reecy, 2007)

They do serve as a helpful reminder that it is our duty to provide our kids and grandkids with an equally abundant planet as we did, but they offer no guidance on how to truly create a sustainable society. When air, water, and minerals interact with living things to fill a specific region, it is referred to as an ecosystem (Tansley, 1935). This word was first used in 1935. Before then, the main goals of land management had been to provide a single item, like food or lumber, or to conserve a single, iconic species.

These developments have revolutionized the way customers interact; from merely checking in with their mobile phones, and controlling their room settings, to house-keeping and service delivery, thanks to AI-powered customization and automation. Using cloud services for managing properties and improving cyber security helps keep operations smooth and keeps data safe. Efforts to use energy and water more wisely show the industry's move towards being more sustainable. As the HM continues to evolve, industry stakeholders eye towards more personalized, efficient, and sustainable guest experiences. This would reflect the ongoing commitment to excellence and adaptation efforts to strive and evolve in the dynamic global landscape.

Veterinary epidemiology is the study of disease within a livestock population, dealing with the investigation (including identification, quantification, and examination), of the direct and indirect determinants of disease distribution in animal populations. Any epidemiological investigation starts with whether there is an animal health problem in a population, which requires data collection on animal, management, economic, and environmental factors. These data are then analyzed descriptively to assess the frequency of disease occurrence. The results are then used to decide whether investigations of causal relationships between disease occurrence and potential risk factors are necessary for the development of control or prevention policies. Once the relationships are understood, necessary interventions for the disease are then planned and their impacts assessed. Mineral nutrition stands as one of the foundational pillars of fruit production, with essential minerals serving as building blocks for various biochemical processes. Irrigation practices represent another critical aspect of pre-harvest management, as water availability profoundly impacts fruit development and composition. Different irrigation regimes can influence enzymatic activities, fruit texture, and the timing of ripening, necessitating strategic water management to achieve desired fruit quality while minimizing post-harvest losses. Canopy regulation, achieved through training and pruning techniques, offers growers a means to manipulate light penetration and airflow within the orchard. Moreover, the application of plant growth regulators (PGRs) emerges as a tool for fine-tuning fruit development and ripening processes. By modulating hormonal signals, PGRs can alter enzymatic activities, influence fruit texture, and mitigate transportation losses. However, judicious application is paramount to avoid adverse effects on fruit quality and safety. Harvesting decisions, including the determination of optimal maturity and the timing and method of harvest, profoundly impact fruit quality and post-harvest losses.

The National Agroforestry Policy of India is a comprehensive policy framework designed to improve agricultural livelihoods by maximizing agricultural productivity including animal productivity along with tree cover and mitigating climate change. The Government of India launched the policy in February 2014 during the World Congress on Agroforestry, held in Delhi. The focus of the policy is to address Agroforestry, which is an integrated system of practicing agriculture, livestock farming and forest activities on the same unit of land, storing high carbon, there by mitigating climate change. Agroforestry systems have the potential to be more beneficial than traditional agriculture and forest production practices. They may be able to give enhanced productivity, as well as social, economic, and environmental advantages, as well as a broader variety of ecological products and services. It’s important to remember that these advantages are contingent on appropriate farm management. In 2014 India became the first nation in the world to adopt an inter-sectoral policy on agroforestry, which seeks to identify the bottlenecks in expansion on agroforestry in the country and pathways to remove the constraints in a systematic manner.

Conversely, environmental conditions greatly influence agricultural productivity and sustainability, including soil quality, water availability, and climate patterns. Recognition of these interdependencies is vital for devising coherent policies that foster sustainable agricultural practices without compromising environmental integrity (Tilman et al., 2011). The challenge lies in formulating policies that strike a balance between agricultural production goals and environmental conservation imperatives.

Statistics as a wide subject is used in almost all disciplines especially in research studies. Statistics provides scientific tools for representative data collection, appropriate data analysis and summarization of data and inferential procedure for drawing valid conclusion in the face of uncertainty. The growth of agriculture has resulted in a significant increase in the per-capita income of the rural community. Thus, a greater emphasis on agricultural sector is the need of the hour. For countries, like India, the agricultural sector accounts for 18% of GDP and provides employment to 50% of the country’s workforce. Development in the agricultural sector will enrich the rural development which will lead toward rural transformation and ultimately the desired structural transformation (Mogili and Deepak, 2018; Shah et al., 2019). The role of Artificial Intelligence (AI) has been obvious in the agricultural sector recently. The sector needs the impetus from AI based technology to maximize its yield including improper soil treatment, disease and pest infestation, big data requirements, low output, and knowledge gap between farmers and technology.

In some developing countries, milk from horses (Equus caballus) and donkeys (Equus asinus) is an essential food for poor farmers. Generally, horses are more commonly used for dairy purposes in cool areas and donkeys in dry semi-arid regions. Milking equines is time-consuming and has to be repeated five or six times a day. In addition, an equine will not release milk unless it is stimulated by the presence of its foal. Mare’s milk is commonly consumed in the steppe areas of Central Asia, where a traditional lactic-alcoholic beverage called koumiss is produced through fermentation. Horse milk is also an important source of animal protein for pastoralists in Mongolia. The consumption of donkey milk has become very marginal. In some African communities, donkey milk is consumed for medical purposes.

Equus is a genus of mammals in the family Equidae, which includes horses, asses, and zebras. Within the Equidae, Equus is the only recognized existing genus, comprising seven living species. Like Equidae more broadly, Equus has numerous extinct species recognized only from fossils. Equines are odd-toed ungulates with slender legs, long heads, relatively long necks, manes (erect in most subspecies), and long tails. All species are herbivorous, and mostly grazers, with simpler digestive systems than ruminants but able to subsist on lower-quality vegetation. The chromosome number of a horse is 64 (2n).

India has highest cattle population (192.49 million), buffalo population (109.85), in the world producing 24% is the highest milk yield (221.1 million tons in the year 2021-2022, and per capita availability was 444 gm/day) in the world (Source NDDB). India produces 43% of world buffalo meat production. Unfortunately, 80% cattle and 70% buffaloes are non-descriptive and yield very low amount of milk.

After independence Indian Council of Agricultural Research (ICAR) has developed serval projects and plans for research and characterization of livestock species all over the country. Our country holds enormous genetic biodiversity in our domestic animals, result in increasing number of registered breeds in every decade. Breed registration Committee on its online meeting held on 5th December, 2023 approved registration of eight new breeds of livestock. This includes Aravali Chicken (Gujarat) Andamani Duck (Andaman and Nicobar Islands), Anjori Goat (Chhattisgarh), Andamani Goat (Andaman and Nicobar Islands), Bhimthadi Horse (Maharashtra), Andamani Pig (Andaman and Nicobar Islands), Macherla Sheep (Andhra Pradesh), Frieswal Cattle (Uttar Pradesh and Uttarakhand). Endangered, critical and vulnerable breeds of livestock also have been identified by ICAR which need more scientific research and multiplication breed.

The terms such as organic, natural, biological, biodynamic, altemative and sustainable farming have entered the agriculture vocabulary. Inspite of these differences in terminology, basically identical ideologies, ideas and technologies are reflected. The common objectives of all the system are to develop farming methods to restore, maintain or build-up soil productivity, to protect the environment instead of causing pollution, produce safe and healthy food, and preserve or help the small farmer.

In Japan, the farmers study the nature, learn from it and apply the knowledge on their farms. We start with a summary of the significance of water conservation in aquaculture before going into several strategies including aquaponics, biofloc technology, and recirculating aquaculture systems (RAS). Recirculating aquaculture systems (RAS) consume less water and area while producing fish in large quantities.
