Application of the principal of geomorphology provides information, which will be of value in predicating the geometry of aquifers. On weathering and erosion, many geological formations develop landforms that are distinctive in respect of slope continuity of outcrops and symmetry of valley flanks. The surface topographic features of bedrocks can some times be extrapolated to reasonable depths to predict the thickness of alluvium or aeolian sands occurring as valley fill deposits, by treating slope profile as mathematical curves for which equations similar to regression equations can be found (Doornkamp and King, 1971).

The influence of tectonic movements and resultant structural features on landform is of paramount importance for hydrogeomorphologists. The control of structure on landforms and hydrogeological processes are being discussed here. The structural geology concerns with the features such as uniclinal or inclined beds, folds, faults and joints. Of these the structural features like faults, fractures, joints etc appear as linear feature.

Linear features on the surface of the earth have attracted the attention of geologists for over one hundred years. This interest has grown most rapidly since the introduction of aerial photographs into geological studies. Geologists have recently proven that various structural features perceived in remotely sensed images are reliable indicators of geologic resources (Caran et al, 1982). These structures have been used in many applications: petroleum and mineral exploration (Blanchet, 1957); nuclear energy facility siting (Seay, 1979); geothermal assessments (Woodruff et al, 1982); and water resource investigations (Lattman and Parizek, 1964). Lattman and Parizek (1964) established a relationship between the occurrence of groundwater and fracture traces for carbonate aquifers, and in particular zones of localized weathering and increased permeability and porosity underlying these structures.

Water is a primary source of life and sustains all human activities such as domestic needs, agriculture, industries etc. The allocation and management of water resources is becoming a difficult task due to increasing demands, decreasing supply and diminishing quality. This calls for judicious use of water resources. The geomorphology describes the environment in which the hydrological processes operate. A strong mutual correlation exists between geomorphological variables and hydrological characteristics. Such relationship can be applied to both surface and groundwater regime. Thus the linking of geomorphological parameters with hydrological characteristics of the basin provides a simple way to understand the hydrogeomorphological behaviour of different basins and particularly of un-gauged basins.

During the last few years various applications of hydrogeomorphology with reference to the Geographic Information System (GIS) and various other techniques have emerged as an extensively effective tool for analyzing and prioritizing natural resource management alternatives. Because natural resource management problems are spatial in nature the GIS technology provides a tool for defining the extent of the problem, and facilitates the design and implementation of alternative management strategies. The GIS is used to estimate the hydrogeomorphological parameters of the watershed, which can be used in watershed planning and management at micro and macro levels. The results of the study can be utilized to infer the hydrological features like runoff potential, infiltration and groundwater recharge of the region. Some of the applications of hydrogeomorphological studies are described below:

Genetic Basis of Heterosis

There are three theories to explain the genetic basis of heterosis: (1) dominance hypothesis, (2) over-dominance hypothesis and (3) epistasis.

Dominance Hypothesis

Davenport (1908) first proposed this hypothesis and he considered that heterosis is a consequence of action and interaction of favourable dominant genes brought together in a hybrid. Bruce, Keeble and Pellew explained it in 1910. This hypothesis suggests that at each locus the dominant allele have favourable effect, while recessive allele has unfavourable effect. In heterozygous state, deleterious effects of recessive alleles are masked by their dominant alleles. Thus, heterosis results from masking of harmful effects of recessive alleles by their dominant alleles. The harmful effects of recessive alleles, which becomes homozygous due to inbreeding. Therefore, according to dominance hypothesis, heterosis is not the result of heterozygosity; it is the result of prevention of expression of harmful recessive allele by their dominant alleles (Fig.1). In this hypothesis, there are two objections (i) the first objection relates to the failure in isolation of homozygous lines for all the dominant genes, and (ii) the second objection is directed at the symmetrical distribution in F₂. Both the objections are discussed below:

Goat is the 1st domesticated animal in the ancient age and has been considered to be the Poor Man’s Cow Goat’s meat is lean & has low fat and the demand for goat’s meat is increasing, with rising prices. Goats usually give birth to twins & triplets. Goat is a multi functional animal and plays a significant role in the economy and nutrition of landless, small and marginal farmers in the country. Goat rearing is an enterprise which has been practiced by a large section of population in rural areas. It can efficiently survive on available shrubs and trees in adverse harsh environment in low fertility lands where no other crop can be grown. In pastoral and agricultural subsistence societies in India, goats are kept as a source of additional income for their meat, hair fiber, and dairy, or as a pet. Goats are also used in ceremonial feastings and for the payment of social dues. According to FAO (2008) goat milk production in India were 4 million metric tons, Bangladesh 2.16 million metric tons and the Sudan 1.47 million metric tons over much of the world. Goats are among the main meat-producing animals in India, whose meat (chevon) is one of the choicest meats and has huge domestic demand (Shalander Kumar, 2007). Goat rearing is an enterprise which has been practiced by a large section of population in rural areas. Goats can efficiently survive on available shrubs and trees in adverse harsh environment in low fertility lands where no other crop can be grown. (Oberoi et al., 199I) reported that in variable cost, expenditure on labour was the major component of cost and was 81% under goat farming.

1. INTRODUCTION

Plants produce an array of natural products, the secondary metabolites, which play a variety of roles such as pollinator attractants e.g. pigments and scents and defense molecules against attacks by animals and microorganisms. These substances are very much important as a source of pharmaceuticals, fragrances, agrochemicals and food additives. Great efforts have been made by the chemical industry to mimic and synthesise these compounds. However little success has been achieved and plants still remain the major source of these vital compounds (Wink, 1990). In the late 1970s plant cell culture was thought to be an alternative or additional way of producing these compounds (Alfermann and Peterson, 1995). The low yields obtained with cultured cells and inferior to the amounts present in intact plants, provided a major drawback to their commercial exploitation. The plant derived pharmaceuticals represent a large market value; about 25% of today’s pharmaceuticals contain at least one active ingredient of plant origin. So only a minute fraction of the enormous biosynthetic potential of plant cells is being exploited. The most popular analgesic drug aspirin and the most valuable anti-cancer drugs paclitaxel and vinblastine are derived solely from plant sources (Pezzuto, 1996).

Over the last 10-15 years, the successful genetic transformation of plants has been reported in about 200 species including agricultural crops, trees, ornamentals, fruits and vegetables. Such genetic modification has improved specific crop traits, such as resistance to pathogens, to herbicides and to various environmental factors including drought and floods (Bajaj and Ishimaru, 1999). Following on from this success genetic transformation of medicinal plants has been attempted, primarily to enhance the production of various pharmaceuticals, flavours and pigments. During the early 90’s it was suggested that metabolic engineering of biosynthetic networks might be achieved by application of recombinant DNA methods.

17.1 Rice

Rice culture at present dominates irrigated agriculture. About 64% of the irrigation water resources in Andhra Pradesh are used for cultivation of rice. An adequate water supply is one of the most important factors in rice production. In many parts of India including Andhra Pradesh rice plants suffer from either too much or too little water because of irregular rainfall and land topography.

Percolation losses in rice fields

Percolation losses are a function of the local soil and topographic conditions. Therefore, at any time the amount of rainfall or irrigation water entering the soil becomes greater than its water holding capacity, losses by downward movement of free water (vertical percolation) will occur. Percolation is often defined as the movement of water through saturated soils due to gravity, hydrostatic pressure or both.

Thus where the soil is heavy and the water table is close to the soil surface, percolation losses are low, about 1 – 2 mm/day. On the other hand, where the soil is light and the water table is deep, percolation losses may be high, about 8 – 15 mm/day, or more. About 50 to 60% of applied water to rice is lost by deep percolation. The percolation losses can be reduced by adopting following agronomic practices:

Measurement of soil moisture content is one of the most routinely done soil characterization. Knowledge of soil moisture is essential to understand the behaviour of soil as a medium for plant growth. Moreover, this property of soil helps to explain other processes of the soil. There are several methods of measuring soil moisture content. The most commonly used methods are gravimetric and tensiometric. The standard gravimetric method is quite accurate and simple but is time consuming, cumbersome and destructive. Furthermore, due to relatively small soil samples that are taken, the variability between replicates is great.

Gravimetric Method

Equipment needed includes zip-loc bags or aluminium moisture boxes and soil sampling tools. Soil sampling tools can be a soil probe, auger, or even a post-hole digger. Balance and scale should have accuracy to 0.1 gram. Proper sampling of the field is important to obtain a representative sample of the field. The soil sample should be collected from the field at a minimum of three locations, and the sample locations chosen should represent the entire field. Sampling from the small areas of low spots or ridges that do not represent majority of the field should be avoided. If there are major changes in soil classification within a field, the field should be divided into sub-sites and samples are collected accordingly.

The emphasis today has graduated from cost arbitrage and quality deliverables to Intellectual property (IP) creation and research and development. Intellectual or Intangible property is the creation of human mind. An intellectual property under protection by law is intellectual property right (IPR). Intellectual property is an important business asset giving significant competitive advantages. Intellectual properties are protected by giving time bound restriction to inventor, owner, author, originator, or plant breeder to use, sell, share, or distribute intellectual asset. These are exclusive rights to the owner and give ability for a lawsuit against others for infringement of IP owner. It is also a marketable asset, which can be licensed out to a third party bringing income to the business in the form of license payments and royalties. Intellectual property rights are legal rights, which result from intellectual activity in the industrial, scientific, literary and artistic fields. These rights give statutory expression to the moral and economic rights of creators in their creations. Intellectual property rights safeguard the creators and other producers of intellectual goods and services by granting them certain time-limited rights to control the use made of those productions. These rights also promote creativity, dissemination, application of their results and encourage fair-trading, which contributes to economic and social development.

Plant pathogens are known to cause yield reduction of almost 20 per cent in the principal food and cash crops worldwide (Oorke et al., 1994). These losses may be more severe when highly susceptible cultivars are widely grown in a particular region of the globe. The increased world’s population is posing a major global challenge to provide sufficient quatity of food with high quality fruits and vegetables. Nearly, 570 million US $ is now spent annually on research and development by the leading 15 agricultural Companies to combat with the important diseases of major food, fruits and vegetable crops. There are more than 150 active ingredients registered as fungicides worldwide (Mc Dougal, 1996). In the present era of intensive agriculture, fungicides play an important role in our fight against plant diseases and reduce the losses in yield and quality of farm produce. The global fungicide sale has been estimated to be $ 6.0 billion US. The cereal and vine industries of the Western European have become largest fungicide market followed by North America. However, the fungicide use is not intensive in Asia and the new world.

This article presents the historical development of fungicides, mode of their action, development of resistance to fungicides, fungicidal residue and chemical control of various diseases of horticultural and plantation crops.

India is the world’s second largest producer of fruits, of which mango, banana, citrus, guava, grape, pineapple and apple are the major ones. Apart from these, fruits like papaya, sapota, aonla, phalsa, jackfruit, ber, pomegranate in tropical and sub-tropical parts and peach, pear, almond, walnut, apricot and strawberry in the temperate parts are also grown in a sizeable area. Date palm and fig cultivation is also finding favour in some areas. The major fruit growing states are Maharashtra, Tamil Nadu, Karnataka, Andhra Pradesh, Bihar, Uttar Pradesh and Gujarat.

Production of fruits in India is 44.04 million tones from an area of 3.72 million hectares. One of the bottlenecks in fruit production is the losses incurred by insect pest and diseases which necessitated the use of pesticides to curb the pest problem. Use of pesticides in India is very low 0.350–0.5 kg/hectare as compared to 7.0 kg/hectare in USA, 2.5 kg/hectare in Europe, 12 kg/hectare in Japan and 6.6 kg/hectare in Korea. Despite of low pesticide consumption in India, there is a great problem of pesticide residues vis-a-vis other countries and these residues have entered into food products and underground water because of non-prescribed use of chemical pesticides, wrong advice and supply of pesticides to farmers by vested interests, non-observance of prescribed waiting period, pre-marketing pesticide treatments during storage and transport, use of sub-standard pesticides, effluents from pesticide manufacturing units, continued use of persistent pesticides for public health programme, lack of awareness and lack of aggressive educational programmes for farmers/consumers.

Need of Analysis Technique

There are various methods to determine the concentration of a substance present in the matrix of an organic matter, these methods are very expensive, require expertise, need skilled man power, expensive chemicals and sophisticated equipments. But the volumetric analysis requires very less equipment and its level of accuracy is fairly high. It is very beneficial in the preparation of normal and molar solutions which is the back bone of all the research. Scientific venture is useless without the preparation of accurate standard solutions which is to be used in the estimation of various substances by sophisticated techniques like colorimetry, spectrophotometry, atomic absorption spectrophotometer (AAS), inductively coupled plasma emission spectrophotometer (ICP) etc. So the emphasis has been laid on the preparation of quick and accurate preparation of the standards. Volumetric analysis is the simplest technique by which, we can determine the concentration of a substance in solution form by titration of unknown solution against a known concentration solution. Present day botanic gardens have their origins from medicinal plant gardens established during the middle of the 16^th century meant for the cultivation of medicinal plants. Therefore, the roots of botany are traced from the medicine. The modern botanic gardens are considered as an ordered collection of plants, assembled primarily for scientific and educative purposes. They serve as the living repositories and offer excellent opportunities for ex-situ conservation, taxonomy, and studies on various other botanical aspects as mentioned below:

Farming system approach addresses itself to each of the farmer enterprises; inter relationship among enterprises and between the farm and environment. Thus farming system research has the objective of increasing productivity of various enterprises in the farm. Farming system approach introduces a change in farming technique for high production from a farm as a whole with the integration of all the enterprises. The farm produce other than the economic products for which the crop is grown can be better utilized for productive purposes in the farming system approach. A judicious mix of cropping system with associated enterprises like dairy, poultry, piggery, fishery, sericulture etc. suited to the given agro-climatic conditions and socio economic status of farmers would bring prosperity to the farmer.

Combination of Integrated farming system (IFS) along with organic farming so called integrated organic farming system (IOFS)appear to be the possible solution to the continuous increase of demand for food production, stability of income and improvement of nutrition for the small and marginal farmers with limited resources. Integration of different enterprises with crop activity as base will provide ways to recycle products and waste materials of one component as input through another linked component and reduce the cost of production of the products which will finally raise the total income of the farm. This becomes quite essential as crop cultivation is subjected to a high degree of risk and provides only seasonal, irregular and uncertain income and employment to the farmers. With a view to mitigate the risk and uncertainty in agriculture, IOFS serves as an informal insurance.

Production of agricultural crops, vary in response to changes of the seasons. In the recent period stable income of agricultural crops has become unstable. Redressing these by integrating crops with agro-based industries like livestock farming is essential. An integrated organic farming system applies the concept of “Low External Input Sustainable Agriculture” (LEISA) and this system develops the livestock business and the crop business in one location or area using local resources to optimize inputs. Designing a farming system to tie together principles of sustainability and productivity is complex. Organic farmers must consider how the various components of their system - rotations, pest and weed management, and soil health - will maintain both productivity and profitability. This section outlines the major principles incorporated into organic farming systems.

Abstract

There is a consensus amongst the geoscientists that overall there has been progradation along the east and west coasts of peninsular India. However, the present day configuration of the coasts and some of the geomorphologic features such as absence of spit and delta along west coast and absence of major estuaries and petroliferous structures along east coast still remain controversial. The present study, based on the appreciation of certain geomorphological and tectonic features on Landsat imagery and aerial photographs of southern part of Indian Peninsula, suggests that the evolution of the coastline has been mainly controlled by tectonism.

The tapering nature of the coastline is attributed to the Precambrian orographic axis. The serrated nature of the post Precambrian coast line is due to the Precambrian transverse faults, whereas the serrated margin of the post Gondwana, Post cretaceous and post Tertiary coast lines are attributed once again to the Precambrian faults reactivated time and again. During the Quaternary period the coast line has undergone many modifications. The coast line attained sinuosity due to Pleistocene folding which is well manifested by river migration. The coast line was subsequently faulted and shifted with en echelon pattern due to N-S regional compression which is referable to the collision of Indian Plate with Tibetan plate.

Pulse production in NE states in still too low as compared to whole India. However, there is very good potentialfor enhancing pulse producity in the region and contribute to food grain production of the country. In view of these constraints, prospects for increasing pulse production from this region have been visualized.

Pulse production scenario

Despite immense importance of pulses in humanand animal nutrition, the share of north-easternregion inthe total pulse areofIndiaistoolow (0.76%)andthisregion contributesonly176.44 thousandtons(0.99%) in the all Indiapulse production (Table 1). WithinNE Region, mostof the pulsearea isoccupied by Assam and 47% of total N.E. Region’s pulse production is contributed by this state alone. After Assam, Nagaland and Tripura are major pulse growing states with 33.5 and 14.5 thousand hectares of area and 36.46and 24.20thousandtons ofproduction, respectively. In Meghalaya, pulseswere grownon4 thousandhaarea and4.2 thousand tonnesof pulses wereharvested in 2010-11. Thefactthat theaverage pulse productivity of NE region (883.0kg/ha)is much higher thanthatof whole India (689kg/ha) offers opportunityfor increasingarea and production of pulses in the region.

Among thirty major cropping systems in the country, which contribute significantly to the national food basket, the majority are cereal-based. In fact, continuous cropping of cereal-based systems during last three decades has resulted in second generation problems and the sustainability of these systems is under threat. The major challenge is to produce more from each unit of land on the one hand and to sustain soil health on the other. The depletion of soil fertility by the intensive cereal-cereal production systems is considered to be a major cause of the yield decline. For example, a rice-wheat cropping system (RWCS) yielding 7 t/ha of paddy and 4 t/ha of wheat removes 315 kg nitrogen (N)/ ha, 28 kg phosphorus (P)/ ha and 333 kg potassium (K)/ ha, and significant amounts of micro-nutrients (Hegde and Dwivedi, 1992). These off-takes often exceed fertiliser input in many Indian states. Refinement of nutrient management strategies would help maintain the crop productivity and soil fertility, but other rotational strategies could also help especially in situations where greater fertiliser use may be uneconomic or environmentally unacceptable. Legume crops fix atmospheric N and enrich soil fertility, and could help to sustain the long-term productivity of cereal-based cropping systems. Depending on the soil and ecological stresses, a cropping system can be diversified using legumes under different mode. Results from the All-India Coordinated Project on Integrated Farming Systems (AICRP-IFS) of Indian Council of Agricultural Research show consistently better productivity with inclusion of legumes in cropping systems. The benefits of legumes in rotation are not solely due to biological nitrogen fixation but also because it increased nutrient availability, improved soil structure, reduced disease incidence and increased mycorhyizal colonization (Wani et al., 1995). Inclusion of pulses as intercrops in sequential as well as intercropping systems would not only make the country self reliant but also help in improving the soil health. Series of experiments are being conducted under (AICRP-IFS) and elsewhere in the country to identify need based cropping systems for different agro-climatic zones of India. The pre-dominent cropping systems involving legumes as a strategy for nutrient management through different approaches are being discussed here for ready reference of researchers, planners and extension workers.

In the past, focus on implementing plant protection measures was given to cereals, largely because of their central role in food security, however, recent shortages in legumes has warranted an all out attention on edible pulses. For more than four decades, the concept of integrated pest management (IPM) - which combines a range of controls, including conserving natural predators, using pest resistant crop varieties, intercropping and rotation, with judicious use of pesticides -has struggled to gain ground against conventional agricultural ideology and practices. But it is now increasingly challenging the methods of high-input agriculture and policies arising with implementation of General Agreement forTrade andTariffs (GATT) & World Trade Organization (WTO) that cannot be ignored. In fact, a major factor responsible for sustaining soil productivity in this country has been the highly diversified nature of the cropping patterns which either include a pulse crop or a legume crop as one of the components. India is the largest producer of pulses in the world with 25% share in the global production. While chickpea is the topper among pulses occupying 39% of pulse area, pigeon pea is next with 21% area. The major pulse producing states are Maharashtra (20%), Madhya Pradesh (17%), Rajasthan (11%), Uttar Pradesh (11%) andAndhra Pradesh (11%) together accountingfor 70% of thetotal production of 14.76 m.t from an area of 23.63 m ha (www.agricoop.nic.in, 2007-08). In general, the pulse production is not keeping pace with the domestic requirements, hence, the country has to import 1.5-2.8 m.t per year, which is a matter of concern. Keeping this in view, the 1PM programme covers the two important pulse crops viz., chickpea and pigeon pea, across different cropping systems which will take care of changing scenario emerging out of climatic changes as well as cropping patterns. The present strategy, which is based on a holistic approach and changing ecosystem, will help in increasing production through reduction in pest infestation that would eventually reduce the need for the import of these two vital commodities.

Pulse legumes are considered to be the best choice for intensification of predominant cereal-based systems. The studies conducted in different agro-climatic zones under AICRP on cropping systems have revealed that the productivity of existing cropping-systems can be enhanced by the inclusion of legumes during summer or as catch crop, or in intercropping systems (Gangwar et al., 2009). Further, these food legumes also serve as a feed crop in many farming systems and fetch higher prices compared to cereals and are increasingly being grown to supplement farmers’ incomes (Gouda et al., 1999). Although pulse legumes have many desirable characteristics in terms of increasing system’s productivity, raising nutritional standards and environmental benefits, in most countries of the world they are considered secondary crops. Globally, the harvested area under pulse crops is about one-tenth of the harvested area under all cereal crops. In view of the important and diverse role played by pulses in the farming systems and in the diets of the poor population, this chapter presents the global trade scenario in pulses followed by pulses production and trade opportunities in India. An attempt is also made to highlight the major concerns and to meet the future challenges in production and trade of pulses in India.

15.1 INTRODUCTION

Cropping system is defined as a cropping pattern followed on a farm and its interaction with farm resources, other farm enterprises and production technology. In other words, cropping system refers to a combination of crops in time and space. When annual crops are considered, a cropping system usually means the combination of crops within a given year (Willey et al., 1989). This cropping system might provide insurance against crop failure by reducing disease (Fininsa and Yuen, 2002) and insect incidence (Gahukar, 1989) or against unstable market prices by planting two or more crops under intercropping and thus, reducing the risk of unexpected changeable prices. Intercropping in scientific way should be viewed from a theme of competition to one of collaboration with mutually beneficial relation with proper planning to get more return from limited natural resources. Legumes have been the common intercrops in any intercropping system owing to their short duration, N-fixing ability etc. Even though non-leguminous vegetables require longer duration than legumes and are non-N-fixers, they can also be suitable as intercrops because of their high profitability and higher yields.

1. pH Meter

pH meter/electrode systems are the most common method of measuring pH in the biology laboratory. Although more expensive and more complicated to use than chemical indicators, pH meters provide greater accuracy, sensitivity, and flexibility. When used properly, pH meters can measure the pH of a solution to the nearest 0.1 pH unit or better, and they can be used with a variety of samples.

2. UV Spectrophotometer

Perhaps there is no other technique except UV-visible spectroscopy, which has been so extensively employed and has such a profound impact on progress in biochemical investigations. UV-visible spectroscopy has undoubtedly become an indispensable tool and is routinely used for identification and quantitative estimation of most of the biomolecules. Besides other applications, most of the enzyme assays and the screening of biomolecules recovered in different fractions by separation processes such as column chromatography, density gradient centrifugation etc, rely heavily on spectrophotometer or colorimetric technique.

History of PCR

A 1971 Kleppe and co-workers first described a method using an enzymatic assay to replicate a short DNA template with primers in vitro. However, this early manifestation of the basic PCR principle did not receive much attention, and the invention of the polymerase chain reaction in 1983 is generally credited to Kary Mullis.

At the core of the PCR method is the use of a suitable DNA polymerase able to withstand the high temperatures of >90°C (>195°F) required for separation of the two DNA strands in the DNA double helix after each replication cycle. The DNA polymerases initially employed for in vitro experiments presaging PCR were unable to withstand these high temperatures. So the early procedures for DNA replication were very inefficient, time consuming, and required large amounts of DNA polymerase and continual handling throughout the process.

The discovery in 1976 of Taq polymerase (a DNA polymerase purified from the thermophilic bacterium, Thermus aquaticus, which naturally occurs in hot (50 to 80 °C (120 to 175 °F) environments) paved the way for dramatic improvements of the PCR method. The DNA polymerase isolated from T. aquaticus is stable at high temperatures remaining active even after DNA denaturation, thus obviating the need to add new DNA polymerase after each cycle. This allowed an automated thermocycler-based process for DNA amplification.

Developed the PCR in 1984 by Kary Mullis, PCR is now a common and often indispensable technique used in medical and biological research labs for a variety of applications. These include DNA cloning for sequencing, DNA-based phylogeny, or functional analysis of genes; the diagnosis of hereditary diseases; the identification of genetic fingerprints (used in forensic sciences and paternity testing); and the detection and diagnosis of infectious diseases. In 1993 Mullis was awarded the Nobel Prize in Chemistry for his work on PCR.

In conventional breeding for genetic upgradation of yield and other desirable attributes of crop plants, favourable assemblages of genes from two or more parents are made to develop a commercial variety. The important steps of this exercise are: locating the right kind of parents that possess the desired characteristics; making crosses between or among them; handling the segregating generations in an appropriate manner so as to identify the required recombinants; stabilizing the recombinants and finally evaluating their performance in a series of trials. This approach has been very successful in the sense that it has provided increments in productivity continuously. In an analysis done by the American Society of Agronomy on the genetic contributions to yield gains of five major crop plants, it was concluded that sorghum yields increased due to genetic improvements at the rate of 1.2 per cent per year between 1950 and 1980. For corn, the corresponding yield increase was 90 kg/ha/year between 1930 and 1980, which is equivalent to a rate of increase of 1 per cent per year. It was also estimated that 70 per cent of the total gains in corn yields are attributable to genetic improvement and 30 per cent of the yield gains are due to non-seed inputs like fertilizers, pesticides and cultural practices.

In India also, the improvement of productivity of the major food, fibre and several cash crops has been very impressive. The success is due to intensive research in plant breeding resulting in the evolution of varieties with very high genetic yield potentials and the concurrent support from other disciplines that has provided the package of practices which help in the realization of the created potential. In all crop plants, where the breeding efforts have been intensive, the phenomenon of plateauing of yields has become apparent. Wheat provides, perhaps, the best example of the situation. Since the 1970s, when the gains from genetic restructuring of the plant type had been established, major yield increases have not occurred. Since the demands of the future will be undoubtedly much larger, and additional cultivable land will not be available, ways will have to be found for a sizable increase in productivity per unit area in the immediate future. This requirement calls for the development of strategies and procedures that will make dramatic yield gains possible. For meeting the challenge, a continuous search is being made for innovative methods which will give yield increments of a much higher order than those provided by the conventional approach. In this chapter, an attempt has been made to introduce some such promising approaches.

Organ of vision (Eye)

The vision is by far the most used of the five senses and is one of the primary means that is used to gather information from the surroundings. The organ of vision or the bulb of the eye is contained in the bony socket called the orbit in the skull. The bulb of the eye (eyeball) is embedded in the fat of the orbit. Associated with the eyeball within the orbit are certain accessory structures viz. the muscles, fasciae, eyelids, conjunctiva and lacrimal apparatus.

Orbit

The orbit is the cavity or socket in the skull wherein the eyeball and its accessory structures (appendages) are situated. The orbit is continuous caudally with the temporal fossa. The axis of the orbit which is usually considered as running between the optic foramen and the middle of the socket is directed rostrad, laterad and dorsad. The medial wall of the orbit is formed by the frontal, lacrimal and the presphenoid (wing) bones of the skull. It is concave and smooth. The medial wall in its rostral part presents a fossa that is called the lacrimal fossa which accommodates the lacrimal sac along with the lacrimal gland. Caudal to the lacrimal fossa is a small depression for the attachment of obliquus ventralis muscle. The dorsal wall of the orbit is formed by the frontal and partly by the lacrimal bone. The supraorbital foramen, an opening of the canal perforating the root of the zygomatic process, is situated in the dorsal wall of the orbit. The ventral wall is slightly rough and is formed by the zygomatic bone, the zygomatic process of the temporal bone, the zygomatic process of the frontal bone and the part of the maxilla bone. The lateral wall (rim) of the orbit is formed by the zygomatic process of temporal bone and the temporal process of the zygomatic bone. Several foramina and/ or fissures for the passage of the vessels and nerves are located in the walls of the orbit. These include the optic, alar, oval, supraorbital, ethmoidal, lacrimal, maxillary, sphenopalatine, and the orbitorotundum foramen.

Water is an important element for life on the earth. It is an essential recurrent natural resource for environmental sustenance, agricultural productivity, industrial growth, power production, enrichment and renewal of land and air. For easy assess to the water, the first human settlements occurred along the banks of rivers and ensuing civilizations flourished in river valleys. For example, the Indian civilization of Mohanjodaro and Harappa developed in the Indus valley, the Egyptian civilization in the Nile valley, the Chinese civilization in the Yangtze valley, the Babylonian civilization between the Tigris and the Euphrates rivers, Aztec, Maya and Incas civilization in the basin of Amazon river.

The industrial revolution, which, began in the early 18th century in some European and Asian countries, set in the motion for new forces in the society and greatly changed the pattern of social life on the earth. Rapid industrialization and urbanization subsequently brought many changes in the environment and ecosystems in the world. India also witnessed a phenomenon of industrial development in the post independent era. The last four to five decades have witnessed population explosion and increase in the per capita consumption of food, consumer goods and utilization of natural resources. These have lead to the proportionate increase in the domestic and industrial effluent generation in India. The water pollution is continuously increasing at an alarming rate in Europe and Asia. By the end of this century. India's Population is projected to double itself from its present level. Similarly the per capita consumption of food has been estimated to increase by 40% resulting in 50 % production of industrial and domestic effluents in near future.

Apart from the quantity, there will be qualitative changes in the effluent generation which are likely to contain greater amount of oil, toxic chemicals, detergents and dyes. A large number of these compounds are non-biodegradable and are cumulative, thus rendering toxic product. Certain group of animals and plants are selective in their functions and can executive certain toxic chemicals and heavy metals. These biomes are helping more effectively on recycling of industrial effluent as well as domestic effluent management system.

In nature, there exists a balance between abiotic and biotic communities like animals and plants population, raw materials and total biomass present at any time. This balance ensures natural recycling and optimum production in naturally balanced ecosystems. The plant growth is slow, but it ensures optimum utilization of waste products and a healthy environment. The increased population and its human desire to possess all comforts and pleasures had lead to over exploitation of natural resources. The high demand of natural resources lead to the beginning of waste accumulation due to the creation of man made imbalances in the environment. The environment is to provide up to date information about important concepts in surrounding. Information is presented from an analytical, observational and multidisciplinary perspective from which we must view environmental issues in order to the study successfully.

6.1 Introduction

The state of India’s forests is important in many ways, whether it be as a source of fuel and fodder for rural citizens, of industrial inputs for a growing economy, as a habitat for thousands of plant and animal species, a sink for carbon dioxide emissions, or as a protective cover for its soils.

The forest resources forms an ecological system consisting of tree dominated vegetative associations. Forests not only provide timber, fuel wood, pulpwood fodder and fiber grasses, and non wood forest produce and support industrial and commercial activities but also maintain the ecological balance and life support systems essential for food production, health, and all round human development. The innate complexity and inherent diversity of forest ecosystems make it difficult to establish clear cause-and effect relationship or to predict the outcomes of a given intervention accurately. Figure 6.1 shows that the percentage of land mass with forest covered and non forest area in India

12.1 Introduction

Volatile Organic Compounds (VOCs) are chemicals that evaporate easily at room temperature. The term “organic” indicates that the compounds contain carbon. VOC exposures are often associated with an odor while other times there is no odor. Both can be harmful. There are thousands of different VOCs produced and used in our daily lives.

Cauliflower follows cabbage in importance with regard to area and production in the world. However in India Cauliflower is more widely grown than cabbage. This crop grows at a latitude 11°N to 60°N with average temperature ranging from 5- 8°C to 25-28°C. It can stand to the temperature as low as -10°C and as high as 40°C for a few days. Italy and India are the major countries growing CF on large scale. Important cauliflower growing states in India are UP, Karnataka, West Bengal, Punjab and Bihar. It is commonly grown in Northern Himalayas and Niligiri hills in south.

Origin and Distribution: Cauliflower is thought to have been domesticated in the Mediterranean region since, the greater range of variability in the wild types of B.oleracea is found there (Nieuwhof, 1969). Wild Cole warts are still found in wild state in sea cost of England and Denmark and in the North West France and various localities from Greece to Great Britain. The Cole crops, including cauliflower and cabbage have descended from a common Kale like ancestor, the wild cabbage (B.olearcea var. sylvestris L.) which is still found in western and southern Europe and North Africa (i.e, sea coasts of England and Denmark and in North West France and various localities from Greece to Great Britain). Cyprus and area around Mediterranean courts are considered to be the primary centers of origin for Cauliflower. It is also reported that cauliflower is originated from a related species. B.cretica. As per Bosewell (1949), it originated in the islands of Cyprus from where it moved to other areas like Syria, Turkey, Egypt, Italy, Spain and North Western Europe. Cornish types originated in England fallowed by temperate types originated in Germany and Netherlands in 18th century. The present Indian tropical cauliflowers developed as a result of intercrossing between European and Cornish type. In India tropical types with resistance to high temp and high rainfall conditions have been developed. Tropical types are grown in Indian plains from May to September, followed by temperate types known as snowball cauliflower.

Cole crops are a group of vegetables belonging to the family Brassicaceae (Syn: Cruciferae) and include cabbage, cauliflower, knoll khol, kale, Brussel sprouts, sprouting broccoli, etc. Cole crops are found spread all over Europe from the Mediterranean region, which is supposed to be the centre of origin. In the ancient Egyptian and Asian civilization, there was mention of cole crops and also by Aristotle in his writings on ‘Enquiry into plants’ there was mention about three types of coles. It is believed that it was first collected for food at the beginning of Neolithic times before being cultivated, and the cultivated forms of cabbage group like, cabbage, savoy, kales, collard, broccoli, Brussels sprouts, cauliflower and kohlrabi gradually originated from wild species through mutation, human selection and adaptation.

Among the cole crops in India cauliflower and cabbage are the two most important crops while Kohlrabi is grown very less. In India it is cultivated in states of Uttar Pradesh, Karnataka, Maharashtra, Bihar, West Bengal, Punjab and Haryana. It is also grown in milder climates in southern India like Ooty, Bangalore, etc.

3.1. Cabbage (Brassica oleracea L.f. alba)

Cabbage, Brassica oleracea Linne (Capitata Group) is a popular vegetable belonging to the family Brassicaceae (or Cruciferae) and is used as a leafy green vegetable. It is in the same genus as the turnip – Brassica rapa. Cabbage leaves often have a delicate, powdery, waxy coating called bloom. The occasionally sharp or bitter taste of cabbage is due to glucosinolate(s). Cabbages are also a good source of riboflavin.

In India cabbage is widely grown in the states of Uttar Pradesh, Orissa, Bihar, Assam, West Bengal, Maharashtra and Karnataka.

Cultivars/Varieties: Cabbage cultivars are classified on the basis of colour of head and maturity. In India white cabbage is important and these are available in pointed, round and flat shapes. Of these round cabbages are preferred. Common cabbage varieties grown are Golden Acre, Pride of India, Copenhagen Market, Red Acre, Pusa Drum Head, Pride of India, Pusa Agethi, Pusa Muktha, KGMR-1, Kateri, Hardam and Nakshatra.

In Solanaceae family there are 85 genera, which includes both tuberiferous and non-tuberiferous plants. Among the non-tuberiferous, tomato, brinjal and chilli are the important fruit vegetables.

4.1. Tomato (Lycopersicon esculentum Mill.)

Tomato has originated in Peru and Mexican region of South America. It got its name form the azetc work “Tomatl”. In India tomato is the second largest cultivated vegetable after potato. Though it is produced in almost entire country, the major producer states are Andhra Pradesh, Karnataka, Orissa, West Bengal, Bihar, Gujarat, Madhya Pradesh and Maharashtra.

Cultivar/Varieties: A large number of varieties/hybrids of tomatoes are under cultivation. The most popular among them are Arka Rakshak, Arka Samrat, Arka Saurabh, Arka Vikash, ARTH 3, ARTH 4, Avinash 2, BSS 90, CO3, HS 101, HS 102, HS 110. Hisar Anmol, Hisar Arun, Hisar Lalima, Hisar Lalit, Krishna, KS 2, Matri, MTH 6, NA 601, Naveen, Pusa 120, Punjab Chhuhara, Pant Bahar, Pusa Divya, Pusa Early Dwarf, Pusa Hybrid 1, Pusa Hybrid 2, Pusa Hybrid 4, Pusa Ruby, Pusa Sheetal, Pusa Uphar, Rajni, Rashmi, Ratna and Rupali.

Uses

Tomato adds richness to any dish it is added. Besides using for culinary purpose tomato is also used as salad and dressings and also as adjuvant in several locally available fresh snacks. It is used for thickening of gravies in many Indian curries. As a processed product tomato sauce and ketchup are on top of favourites. It is not only delicious in taste but also rich in its medicinal value. The pulp and juice are mild aperient, a promoter of gastric secretion and blood purifier. It is also considered to be intestinal antiseptic. It is said to be useful in sour mouth, canker of mouth and chronic dyspepsia.

Definition: Shrub is a woody plant with several stems/branches arising at or near the ground level from the main stem, which is perennial in nature and smaller than a tree.

Shrubs are the integral part of a garden and have immense importance in landscaping as these are used for various purposes. Shrubs produce flowers, foliage, fruits, berries and enhance beauty of garden tremendously. They are hardy in nature and require less care than other ornamental plants. Availability of a large number of species and cultivars, a wide range of variations in shape, size and growth habits, remarkable range of sizes, shape and colour of flowers and fragrance have made the shrub an important garden plant.

4.1 INTRODUCTION

It is an annual crop cultivated all over India, Bangladesh, Pakistan, China, Japan, South East Asia and Philippines. The fruits are available practically throughout the year. Brinjal fruits are a good source of calcium, phosphorus, iron and vitamins particularly ‘B’ group. A 100 g of edible fruit contains 91.5g of water, 6.4 g of carbohydrates, 1.3g of protein, 0.3g of fat and 0.5g of mineral matters. Its green leaves are the main source of vitamin C (38-104.7mg/100g). Dark purple brinjal has more vitamin C than those with white skin. Bitterness in brinjal is due to presence of glycoalkaloid solasodine. Generally, high amount of glycoalkaloids (20mg/100g) in the fruits produce a bitter taste and off flavour. Brinjal is reported to stimulate the intrapeptic metabolism of blood cholesterol and has marked drop in blood cholesterol level. The de-cholestrolising action is attributed due to the presence of poly-unsaturated fatty acids, PUFA (linoleic and linolenic) which are present in flesh and seeds of fruit in higher amount (65.1%). The presence of Mg and K salts also helps in de-cholestrolising action. Dry fruit is reported to contain goitrogenic principles. Aqueous extracts of fruit inhibit choline esterase activity of human plasma. Brinjal has got much potential as raw material in pickle making and dehydration industries. It is supposed to contain certain medicinal properties and white brinjal is said to be good for diabetic patients. The fruits are regarded as a cure for toothache. It is also an excellent remedy for those who are suffering from liver complaints. Cu content and polyphenol oxidase activity are highest in purple colour fruits and lowest in white fruit. Fe and catalase activity are highest in green fruited cultivars and lowest in white fruited cultivars. White fruited cultivars contain twice as much crude fibre as the purple and green fruited cultivars. Solanum ferox is yellow fruited type and is very popular in southern Europe, France and Italy and USA. Vitamin C content of brinjal is affected by canning. Toasting of fruits raises the nicotinic acid at the expense of trigonellin which is present in it and 66-69% of it is converted into nicotinic acid during toasting.

Brinjal is a self-pollinated crop but cross-pollination also occurs in it i.e., it is often cross-pollinated and pollination is mainly done by bumble bees and honey bees. To encourage pollination and visit of these bees, Mimosa pudica plants should be planted in the vicinity of brinjal. Brinjal flowers are divided into four types namely (i) long styled (ii)Medium styled (iii) pseudo-short styled and (iv) short styled. The maximum fruit setting in different cultivars is in long styled flowers which ranges from 70-86.7% and in medium styled it ranges from 12.5 to 55.6%. There is no fruit setting in pseudo-short and short-styled flowers. In India it is produced in an area of 0.669 million ha with a production of 12.4 million tonnes.

Introduction

Indian subcontinent has a rich and varied heritage of bioresources, encompassing a wide spectrum of habitats from tropical rain forests to alpine vegetation and from temperate forests to coastal wetlands. It is one of the eight centres of origin and one of the 12 mega centres of the world. It possess 11.9 % of world flora and about 33% of the country’s recorded flora are endemic to the region and are concentrated mainly in the North-East, Western Ghats, North-West Himalayas and the Andaman and Nicobar Islands. Of the 49,219 higher plant species, 5,725 are endemic and belong to 141 genera under 47 families. Of theses 3,500 are found in the Himalayas and adjoining regions and 1,600 in the Western Ghats alone. India has 26 recognized endemic centres that are homeland

Introduction

Turnip is an important root crop which is very popular particularly in northern India. It is a cool season crop mainly grown as a fall or winter crop in the hills and winter crop in the plains. Turnip (Brassica rapa L. syn. Brassica compestris var. rapa) belong to family Brassicaceae. It has a chromosome number of 2n=2x=20. Two main centers of origin have been indicated. The Mediterranean area is considered to be the primary centre of origin of European type/temperate types. While Eastern Afghanistan with adjoining areas of Pakistan is considered to be another primary centre with Asia Minor, Transcaucasus and Iran as secondary centre. The parents of cultivated turnip are found in the wild form in Russia, Siberia and Scandnavia. It was cultivated by the ancients and ranked next to grapes and cereals in Italy. It was introduced in England probably in 1590 and United States in 1606 (Yawalkar, 1980). Turnips are now cultivated throughout the world.

Turnips are botanically biennial herbs, but are cultivated as annual root crops for both animal and human consumption. The turnip root contains 41.6% moisture, 6.2 g carbohydrates, 0.5 g protein, 0.2 g fat, 0.04 mg thiamin, 0.04 mg riboflavin, 43 mg ascorbic acid, 30 mg Ca, 40 mg P and 0.4 mg Fe per 100 g of edible portion. The turnip green contains 15,669 IU vitamin A per 100 g (Aykroyd, 1963). Turnip is grown for its enlarged root as well as for its foliage. Extra seedlings from thinning are often used as greens. The fresh roots are consumed in salads or cooked as vegetable or used in pickles. The young leaves contain high amount of ascorbic acid and iron, rank second in vitamin A content and are cooked as greens.

The fleshy thickened underground portion of turnip is actually the hypocotyl. The colour and shape of this underground portion vary with the cultivars and the roots are flat globular to top-shaped and long. The colour of under ground portion may be white or yellow, while that of above ground portion may be red, purple, white, yellow or green. A distinct tap root and secondary roots arise from the lower part of the swollen hypocotyl. Thickening begins in the central part of the hypocotyle, followed by the upper and lower parts. Normally, the roots attain edible maturity in 40-80 days depending on cultivar and climatic conditions.

Introduction

Potato is a wonder crop that can be grown under diverse range of agro-climatic conditions. Short duration; high yield per unit area and time and wide flexibility in planting and harvesting time are important virtues of potato that enable its inclusion in intensive cropping systems.

Potato is not an Indian crop but is a native of high Andean region of South America. It was introduced in India perhaps in 16^th or early 17^th century by either the Portuguese traders or the British missionaries. The present day cultivated potatoes (tetraploid, 2n=4x=48) in most of the world represent Solanum tuberosum spp. tuberosum and S. tuberosum spp. andigena, although it’s numerous diploid (2n=2x=24) relatives are still under cultivation in and around its primary and secondary centers of origin in South America (Pandey and Sarkar, 2005). The great Irish famine in the 19^th century, caused by late blight disease, nearly wiped out all the earliest potato introductions in the Europe and dramatically changed the potato cultivation and production scenario in rest of the world.

Unlike in European Countries 80% of the potato is grown in India under short day conditions as a short duration crop i.e. 70-90 days. The tubers are exposed to high temperatures during planting (September-October) and harvesting (February-May). The crop is irrigated and suffers mid day water stress. The potato varieties introduced from Europe were unsuitable for growing under the above conditions. Systematic potato research in India spanned over the last half-a-century of the 20^th century in the past millennium. The Central Potato Research Institute (CPRI), which was established in 1949, has bean mainly responsible for tremendous growth of potato production in the country. The indigenous technological advances made it possible to extend potato cultivation in almost all part of the country. Now in India, compared to the production, area and yield of potato in 1949-50, the increase over the same period was 1513%, 559% and 270% respectively (Naik and Thakur, 2007). According to the FAO, potato production worldwide stands at 329 million tones and covers more then 19 million ha.

For the intelligent appreciation and understanding of various reactions and processes associated with soils a little basic knowledge of chemistry is helpful. If the reader follows this chapter carefully, the working knowledge of chemistry thus acquired will enable him to follow all the complicated chemical reactions taking place in the soil.

What is Chemistry? Chemistry is the science that deals with the chemical changes. What is a chemical change? When two or more substances combine to give a substance entirely different in properties to the individual components, the change is called a chemical action to distinguish it from the purely physical action in which the properties of the product are intermediate between the components. The latter naturally can be separated easily by mechanical means. For instance a mixture of sand and water can be separated by passing through a filter, and a mixture of salt and water can be separated by evaporating the water when the salt is left as residue. But water itself is a compound of two gases: oxygen and hydrogen. Its properties are totally different from its components. We can freeze it, evaporate it and perform a host of other operations on it without changing it in the least.

Atoms and molecules: The whole science of chemistry rests on atoms and molecules If these are understood clearly, basic chemistry is reduced to simplicity. Take a familiar object like gold or silver and go on subdividing it into smaller and smaller bits. You will reach a stage that further subdivision will become impossible. You will have reached the primary units, the elementary bricks of which the substance is made up, namely the “Atoms”. An atom in chemistry is the smallest brick from which all material substances in the world are made up. Not that you can see an atom. It is so small that even the most powerful microscope will nut reveal its presence. You could perhaps just see a collection of a million atoms as a tiny spot of light if it is illuminated with a powerful beam of light. Even then you could not say if it was round, square, or oblong. However, you need not look for any such tangible proof to believe in the existence of atoms. Even pure logic would compel you to stop somewhere if you started with an imaginary division and sub-division of a substance. You could not go on ad infinitum. Even the ancients, who knew no modern chemistry, believed in their existence purely from philosophical reasoning.

Abstract

Camel milk has been known in Asia and Africa for 5000years for its benefits for human health. It is the closest to human mother’s milk and safe for children. Research studies around the world have confirmed that camel milk has better nutritional value as it exhibits many unique and amazing health-promoting properties as compared to cow milk. This milk is considered as a complete food and can be consumed exclusively while meeting all nutritional requirements. Many studies have reported that camel milk contains very high concentrations of mono- and polyunsaturated fatty acids, low fats, cholesterol, and lactose. It also contains higher amounts of minerals (calcium, iron, magnesium, copper, zinc, and potassium), vitamins B2 and C as compared to cow milk. It does not contains beta lactoglobulin and beta casein that are present in cow milk and that are the main cause of allergy in certain human population. Furthermore, camel milk contains various protective proteins that exert antibacterial, antiviral, and immunological properties. It possesses unique, powerful immune system–boosting components that would exert potential health benefits. It is an alternative for people suffering from cow milk allergy. So camel milk can be considered as next generation super food.

Abstract

Milk is unique in its nutritional composition and it is the secretion of mammary gland with all the nutrients to nourish the young ones. Milk is a widely consumed drink because it provides essential macro and micronutrients and so called as complete food. Humans, not only the infants but also the adults, are the only species that drink the milk of another species, particularly cow’s milk. But cows’ milk has a different in composition and contains in excess of nutrients than human milk. This unnecessary excess nutrients leads to adverse and allergic effects on human health. One of these is milk protein allergy and it is an increasing health care concern. In medicine, the term cow’s milk allergy (CMPA) is only used to describe reactions involving the immune system, while other reactions are normally called cow’s milk intolerance. The feeding of cow’s milk has adverse effects on infants and young children. There are various methods and tests to identify the CMPA and its diagnosis can be achieved by skin or blood tests. Several efforts have been done to reduce the allergic reaction of cow milk proteins and various technological processes have been applied. The treatment of food allergy should be nutritional and is based on the elimination of diet or, in the case of infants, on the use of hypoallergenic or “HA” formulas, diets and best alternatives to cow milk like some Extensively Hydrolyzed Formulas (EHFs) based on whey, casein or another protein source, and by amino acid-based formulae (AAF), Soy protein-based formulas, donkey milk, camel milk etc.

Introduction

The specific agricultural systems and landscapes have been created, shaped and maintained from generation to generations of farmers and herders based on diverse natural resources, using locally adapted management practices. Indian heritage is unique and prestigious than any other civilization in this world. We must feel proud being a citizen of India for its rich cultural heritage. Agriculture in India has a long history from Neolithic age of 7500-4000 B.C. People changed their life style from nomadic hunter of wild berries to cultivator of land. Physiological Development

Industry is part of various multi stakeholder partnership initiatives that support efforts to protect water quality. These include reducing soil erosion, avoiding pesticide run-off and maintaining wildlife habitats as part of a holistic farm or land management approach.

ROLES OF NITROGEN IN CROPS

Plants contain 1-5 per cent nitrogen by weight. It is a structural component of chlorophyll, aminoacids and proteins. Plant proteins contain 16 per cent nitrogen (6.25 × %N = protein). Foods are classified into three groups on the basis of ease of spoilage. Spoilage meant a condition produced by the excessive growth of microorganisms leading gradually to decay or decomposition. The stable or non perishable foods like sugar, flour, grains and dry products do not ordinarily spoil unless handled carelessly. The semi-perishable food like potatoes, onions, apples, waxed fruits, fruits and vegetables having thick skin can be protected from spoilage if properly handled and processed. The perishable foods, like livestock products, seafood, and poultry items, dairy products, and most fruit and vegetables spoil readily unless special preservatives methods are used. The spoilage of foods may be caused by molds, yeast, bacteria, enzymes, food constituents and insects. The use of food additives have become necessary to prevent spoilage other wise caused by the growth of bacteria, yeasts and molds.

Food spoilage usually refers to undesirable changes occurring in food due to the action of micro-organisms, insects and enzymes. The original nutritional value, texture, flavour of the food are damaged, the food become harmful to people and unsuitable to eat. Today however, preservation has used such factors as temperature, water activity, pH, gases, organic acids, salts, antibiotics, irradiation, packaging and various combinations of these factors. Foods vary greatly in the length of time for which they can be held in their natural form without spoilage. Preservatives retard product spoilage caused by mold, air, bacteria, fungi or yeast. Bacterial contamination can cause food-borne illness, including life-threatening botulism.
