The control of infectious diseases of bacterial etiology in food animals is often by using collective and simultaneous medication of a group, i.e. the so-called preventive uses prophylaxis and metaphylaxis. FPI has been identified as a priority list in the “MAKE IN INDIA” program by the Government of India to boost its domestic manufacturing and export share. In the last few years, FPI has emerged as a high-growth and high-profit sector due to its immense potential for value addition while processing food products at various stages. The degree of processing of value addition to agricultural produce in India (20 %) is very low as compared to other countries, such as China (40 %), Brazil (70 %), and Malaysia (80 %). In India, the degree of processed food products ranges between 2 per cent (fruits and vegetables) and 35 per cent (milk) for various agriculture products. Hence there exist a huge potential for the growth of this sector in India. The export value of FPI was US$29.12 billion in 2016 and its share in world import was 2.18 per cent (Agarwal & Neogi, 2017).

India’s food processing sector covers fruit and vegetables; spices; meat and poultry; milk and milk products, alcoholic beverages, fisheries, plantation, grain processing, and other consumer product groups like confectionery, chocolates and cocoa products, soya-based products, mineral water, high protein foods, etc. The output of India’s food processing sector is expected to reach USD 535 Billion by 2025-26 (Invest India, 2020). Out of this, foreign investment is around Rs.10,000 crores (APEDA, 2020). Besides this, Government has also approved proposals for joint ventures; foreign collaboration, industrial licenses, and 100 per cent export-oriented units envisaging an investment.

Like other sectors of the economy food processing sector also suffers from certain constraints. The challenges for the food conservation, distribution and processing sectors are diverse and demanding, which need to be addressed to leverage the growth of agriculture and food processing sector. Following are the major challenges and strategies are suggested to overcome the challenges (Sakina, 2019).

6.1. Domestic Constraints in the Development of Food Processing Industry in India

Despite the significant economic potential of the FPI in India, it still faces massive domestic challenges, which include low level of processing, fragmented structure of the industry, consumer perception and lack of skilled manpower. Firstly, low level of processing means that at industrial level, less food is processed, as compared to household level. Most of the traditional food items like jams, jellies, pickles etc. are prepared at small manufacturing units or by households (Agarwal & Neogi, 2017).

Secondly, consumer perception with regard to processed food in India is not very optimistic and they consider that packaged food is not fresh, thus, leading to low consumption of processed food. Thirdly, food processing sector is still highly fragmented and unorganised. This led to the inefficacies in the sector and has failed to achieve the economies of scale (Agarwal & Neogi, 2017).

This chapter provides a comprehensive appraisal of existing literature to elucidate the role of geospatial technologies, encompassing Geographic Information System (GIS), remote sensing, and the Global Navigation Satellite System (GNSS), which are utilized for data collection, mapping, analyzing distribution, and predicting events related to plant health.

Agriculture plays a pivotal role in India’s economy, it shares 18.2 % (202324) in country’s GDP at current prices and employs 42.3 % of the Indian workforce, particularly in rural areas, making it one of the largest sources of livelihood (Anon., 2024). With 1.41 billion peoples, India is the world largest populous country and agriculture is crucial for ensuring food security. India’s agricultural exports also significant in boosting its economy through generating foreign exchange of 53 billion dollars in 2023 and contributing around 11.8% to total exports (Statista, 2023). India is the largest producer of milk, millets, banana, sapota, cashew nuts, coconuts, tea, ginger, turmeric, black pepper and second largest producer of wheat, rice, sugar, groundnut and in the world (APEDA, 2024). The sector also provides raw materials for many industries, such as textiles and food processing. India achieved self-sufficiency in food grains after Green Revolution, using introduction of high-yielding varieties (HYVs) of crops, especially wheat and rice, chemical fertilizers, pesticides, and improved irrigation techniques, which dramatically increased crop productivity. The improved productivity also helped to increase farmers’ incomes, raise living standards in rural areas, and support the development of rural infrastructure. Moreover, surplus food production allowed India to build buffer stocks, which could be used to manage food shortages or price fluctuations.

Plant Quarantine
The term ‘Quarantine’ is derived from the Latin word quarantum, meaning 40. It refers to the 40 days period of detention of ships from countries with bubonic plague and cholera in the Middle Ages. The first such quarantine was imposed in Venice in 1374.Present quarantine laws now include plants. Plant quarantine , restrict entry of plants, plant products, soil, cultures of living organisms, packing materials, and commodities, as well as their containers and means of conveyance to protect agriculture and the environment from avoidable damage by hazardous organisms.They exclude dangerous organisms while permitting plants and plant products to enter. The term exclusion convey this objective more clearly than plant quarantine. Exclusion relates to keeping organisms out; plant quarantine relates to keeping plants out.
In strict sense ‘Plant Quarantine’ refers to the holding of plants in isolation until they are believed to be healthy. Now, broader meaning of the plant quarantine covers all aspects of the regulation of the movement of living plants, living plant parts/plant products between politically defined territories or ecologically distinct parts of them. Intermediate quarantine and post entry quarantine are used respectively to denote the detention of plants in isolationfor inspection during or after arrival at their final destination.

The overuse of chemical pesticides and farmers’ improper application of them have resulted in a number of issues, including residue in food, feed, and fodder; resistance developing; resurgence, secondary outbreaks; and, most importantly, pollution of the environment. This has caused a condition known as Pesticide Treadmill, which is characterized by the need to apply ever-increasing amounts of chemical pesticides. Integrated Pest/Management was developed as an environmentally sound substitute for the exclusive use of chemicals after Rachel Carson’s book “Silent Spring” in 1962 sparked widespread concern about the overuse of pesticides.
The IDM Concept
In disease management, every alternative control strategy—cultural, biological, mechanical, resistant varieties, physical, etc.—is applied in combination to keep the disease below the threshold of economic injury . In order to control the disease, pesticides are employed if it spreads and hits the economic threshold. With consideration for the agro-ecosystem, this approach to integrated disease management uses the minimum amount of pesticides possible. In reality, we don’t aim for complete control while managing diseases—rather, we let them progress below what is tolerable, such as the economic threshold. Additionally, it offers agents the chance to endure by controlling the diseases and maintaining a particular state of equilibrium. Therefore, the goal of the integrated disease management concept is to manage the disease using all available strategies while achieving positive effects on the environment, society, and economy.

Cold storage is a widely used method for handling perishable goods in bulk between production and marketing stages. It is essential for preserving the freshness and quality of perishable commodities by controlling temperature and humidity within the storage environment. Ensuring the temperature remains sufficiently low is crucial, as failing to do so can lead to chilling damage to the produce. Additionally, maintaining a relative humidity of 85-90 percent in the storage area is vital for most perishables, as lower humidity can negatively affect their quality.
Fruits and vegetables, if stored at ambient harvest temperatures, have a very short shelf life. Post-harvest cooling helps to quickly remove field heat, thus extending the storage duration. Proper cooling after harvest can:
• Reduce respiration and enzymatic degradation;
• Minimize water loss and prevent wilting;
• Slow or stop the growth of microorganisms that cause decay;
• Lower the production of ethylene, the natural ripening agent.

Abstract
India holds a dominant position in the global production and export of castor, accounting for nearly 88% of global and leading the international the international castor oil trade. This chapter investigates the status of castor production and trade dynamics, highlighting India’s evolving role in commercial agriculture and export-oriented strategies. Castor, a non-edible oilseed with significant industrial applications, is primarily cultivated in Gujarat, Rajasthan, and Andhra Pradesh. The study explores trends in area, production and yield across states and districts, alongside export trends over a 15 year period (2006-06 to 2019- 20). Results show positive growth in export quantity, value and unit price, despite fluctuations, supported by favourable policies and quality improvements. Using the Markov chain model, the direction of trade analysis reveals China as the most stable and dominant importer, followed by Netherlands and France. The USA also shows emerging potential. Instability indices indicate relatively low volatility in trade metrics. The finding suggest that while India maintains a strong global presence, strategic efforts are needed to sustain existing markets and explore new opportunities, especially in emerging economies offering better prices and reliability.

ABSTRACT
India’s agricultural exports play a pivotal role in driving economic growth, enhancing rural livelihoods, and generating employment. The Agricultural and Processed Food Products Export Development (APEDA), establishedunder the Ministry of Commerce and Industry, has significantly contributed to the augmentation of India’s agri-exports through strategic interventions. This chapter explores APEDA’s multifaceted initiatives, including quality control, infrastructure development, product diversification, and digital innovations such as paperless systesm, mobile apps, and virtual trade fairs. Notable efforts include the promotion of Geographical Indication (GI) products, expansion of Agri-Export Zones (AEZs), and international marketing of millets during the International Year of Millets (IYOM 2023). APEDA’s Market Access Initiative (MAI) and Agri- Exchange portal have facilitated global trade linkages, while collaborations with institutions and FPOs have strengthened grassroots connections. Recent achievements include surpassing USD 19.69 billion in agri-export value in 2022- 23 and expanding to over 200 countries. This comprehensive engagement reflects APEDA’s central role in branding Indian agriculture on the global stage and positioning India as a reliable exporter of high-quality food products.

Black of the commerce is the dried mature fruit of the perennial climbing vine of Piper nigrum L. It is one of the oldest and most significant spices in the world. Black pepper refers to the whole dried fruit, which is still unripe, while white pepper is made from the fruit after the mesocarp has been removed. Among all spice crops, pepper holds the highest share in foreign exchange, earning it the title of the “King of Spices.” An analysis of various types of black pepper from Kerala, Karnataka, Tamil Nadu and Assam revealed the following ranges of values: moisture content (8.7-14.1%), total nitrogen (1.55-2.60%), nitrogen in non-volatile ether extract (2.70-4.22%), volatile ether extract (3.0-4.2%), non-volatile ether extract (3.9-11.5%), alcohol extract (4.4-12.0%), starch (28-49%), crude fibre (8.7- 18.0%), crude piperine (2.8-9%), piperine (spectrophotometrically) (1.7- 7.4%), total ash (3.9-5.7%), and acid-insoluble ash (0.03-0.55%). Starch is the principal constituent of pepper, making up 34.8% of black pepper, 56.5% of white pepper, and 63.2% of decorticated white pepper. Pepper starch consists of small, polygonal granules similar to rice but much smaller. The alkaloid piperine (melting point: 29-30°C) is the primary compound responsible for black pepper’s characteristic biting taste. Other pungent alkaloids present in smaller quantities include chavicine, piperidine, and piperetine.

Turmeric of commerce is the dried rhizomes of Curcuma longa. Cured turmeric contains 5.8% moisture, 8.6% protein, 8.9% fat, 63.0% carbohydrates, 6.9% fibre, 6.8% mineral matter, 0.2% calcium, 0.26% phosphorus, 0.05% iron, 0.01% sodium, 2.5% potassium, 175 IU of vitamin A per 100 g, 0.09 mg of vitamin B1, 0.19 mg of vitamin B2, 49.8 mg of vitamin C, and 4.8 mg of niacin. It provides a calorific value of 390 calories per 100 g. The primary colouring agent in turmeric is curcumin. It is a significant spice, particularly in rice-based cuisines. Sethi et al., 2016). Farm advisory and resource management services play a critical role in assisting farmers in saline agroecological systems by providing expert guidance, information dissemination, capacity building, and policy support (Adak et al., 2020). Farm advisory can play a crucial role in helping farmers understand the intricacies of saline agroecological systems, including the causes of soil salinity, its effects on crop performance, and the necessary strategies for managing these challenges effectively. Farm advisory can assist farmers in selecting suitable crop varieties that exhibit tolerance to high salinity levels. Introduction
Horticulture is distinct from other economic sectors as its output is heavily reliant on weather conditions. The degree of success of horticultural production and economics is decided to a large extent by how well weather conditions corresponding to the crop’s optimal requirements are best utilized to raise the crops. Also, how successfully adverse weather circumstances, such as moisture, thermal, wind, radiation and biotic stresses were handled to minimize adversity. It is well understood that variability in weather elements (particularly rainfall and temperature) is the primary cause of inter-annual variability in crop output. The onset of weather extremes (dry spells, droughts, floods, heat waves, and hailstorms) has a negative impact on horticultural yield, resulting in a low level of productivity. Furthermore, weather can have an impact on output at multiple levels (vegetative stage, harvest, transportation, storage, etc.). Flooding, droughts, heat waves, cold spells, hailstorms, and other natural calamities pose significant risks to farms. These natural catastrophes can lead to lower yields, leaving uninsured farmers with little income for the season. Farmers often plant low-risk, low-return crops (such as early maturing varieties that are drought-resistant) to deal with erratic weather rather than investing in more profitable crops that are more sensitive to weather fluctuations and extremes. Thus, atmospheric stress has significant impacts on the food ecosystem (Bal and Minhas, 2017; MANAGE, 2018).

Taxonomy, also known as systematics, is the study of classifying organisms into logically related groups. Historically, taxonomy was performed by examining physical characteristics of organisms and classifying species based on the most commonly held traits. Unfortunately, this method of classifying plants and animals assumes that because they share physical characteristics, they must have shared ancestors. Markers are used over the years for classification of plants. Markers are any trait(s) of an organism that can be identified with confidence and relative ease, and can be followed in a mapping population. They can be defined as heritable entities associated with the economically important trait under the control of polygenes. Molecular markers are any kind of molecule indicating existence of a chemical or a physical process. Molecular markers include biochemical constituents (e.g. secondary metabolites in plants) and macromolecules (e.g. proteins and deoxyribo-nucleic acid). These macromolecules show easily detectable differences among different strains of a species or among different species.
The prerequisite for the improvement of any plant species are germplasm collection and its characterization to find out the diversity among the accessions. Characterization can be done by several ways which include morphological, enzymatic and genetical methods. The best way to assess the diversity is based on DNA markers which allow differentiation among genotypes without any environmental influences. These markers have a great potential to identify genetic diversity within and among accessions which help in successful implementation of pre-breeding approaches. Molecular
markers are considered the best tools for determining genetic relationships diversity as they are unlimited in number, show high polymorphism, provides more reliable information, detect more variation than morphological and biochemical markers; and are stage independent, not affected by environment and simply inherited. Molecular markers are ‘tags’ that can be used to identify specific genes and locate them in relation to other genes. They help in ensuing a desired beneficial trait to be maintained or an undesirable trait to be eliminated.

The potential of Vegetable Genetic Resources (VGR) is vast, offering solutions to future challenges such as food and nutritional security. Achieving this requires the identification, collection, conservation, documentation, and utilization of these resources. The introduction and acceptance of improved varieties have resulted in the replacement of numerous landraces and local crop cultivars across various agri-horticultural crops, with a particular impact on vegetables. The alignment of activities related to the management of plant genetic resources at both global and national levels has enhanced the opportunities for utilizing VGR. India possesses a rich diversity of vegetable genetic resources, comprising indigenous and exotic varieties. Information regarding VGR in the Indian region can be accessed through passport data, conservation records, catalogs detailing characterization and evaluation, as well as insights into local vegetable usage, all of which contribute to strengthening these initiatives. This chapter delves into vegetable genetic resources, focusing on economically significant vegetable crops of India, along with regionally important crops, potential species, and their wild relatives, highlighting efforts undertaken at ICAR, NBPGR for its collection conservation, characterization and utilization.

Globally, India ranked second in vegetable production and contributed 15.8 and 14% to global vegetable area and production, respectively. The production of vegetables in India is estimated to be 212.91 million tonnes in the year 2022-23 compared to 209.14 million tonnes in the year 2021-22. India ranked first in production of okra in the world (73% of world production) and second in brinjal (27.55%), cabbage (13%) and tomato (11%). The major vegetable growing states in India are West Bengal (14.1%), Uttar Pradesh (11.4%), Bihar (9.3%), Madhya Pradesh (8.0%) and Gujarat (7.1%). Vegetables are especially important crops for farmers with small holdings because an appreciably higher income per hectare can be generated by growing vegetables than from conventional staple crops (Genova et al, 2006). However, vegetables are generally considered more vulnerable than staple crops to stressful environmental conditions including extremes of temperatures, drought, salinity, alkalinity, water logging, mineral nutrient excesses and deficiency (Chinnusamy et al, 2005). These environmental stresses are likely to be exacerbated by the prevalent climatic changes in many parts of the world.
Among environmental factors, soil salinity stress is one of the main factor reducing production and productivity of vegetables in arid and semi-arid regions where irrigation water has excessive salt and annual rainfall is low. In India, about 6.73 million ha of land (~2.1% area of the country) is salt affected, out of which 2.96 million ha is saline and 3.77 million ha is sodic (Arora & Sharma 2017). About 75% of salt-affected areas exist in four states, i.e., Gujarat, Maharashtra, West Bengal, and Rajasthan (Mandal et al., 2018).

Vegetable crops belonging to the family Cucurbitaceae are known as cucurbits. These include 950 species in over 90 genera, mainly distributed in the tropics and subtropics (Schaefer and Renner, 2011). Enormous diversity of cucurbit genetic resources has evolved in past centuries to cater the nutritional requirements of people in different geographical and climatic regions. A large number of cucurbitaceous vegetables coming from different centres of origin are cultivated worldwide (Table 1). However, these crops are challenged by several biotic and abiotic stresses. Cultivated varieties are constrained by market demands, the necessity for climatic adaptations, domestication bottlenecks, and in most cases, limited capacity for interspecific hybridization, creating narrow genetic bases for crop improvement. Genetic resources are the building block for any crop improvement programme and includes landraces, traditional varieties, wild, weedy and other related species constituting primary, secondary and tertiary gene pools. They are valuable sources of important genetic traits needed for developing resilient and climate smart crop varieties and therefore, important for food security. The success and pace of the development depends on the efficient use of plant genetic resources. Wild relatives are incredible genetic resources carrying several desirable attributes like nutritional quality, resistance to biotic and abiotic stresses etc. Most of the crop wild relatives of cultivated crops across the world are not receiving adequate attention for their effective utilization in breeding programs. It is therefore, of utmost priority to protect them in the wild, through in-situ conservation, where they can continue to evolve and develop these useful adaptations. ICAR-National Bureau of Plant Genetic Resources (ICAR-NBPGR) is the nodal agency for the management of national wealth of vegetable genetic resources speciallyworking for collections, characterization, identification and documentation of new germplasm. Besides, it also bears the responsibility for conservation of the germplasm for future through sustainable use. The Vegetable germplasm is being conserved both under in-situ and ex-situ genebanks. This chapter highlights the status of Cucurbit genetic resources and procedures to access the germplasm by various stakeholders for research use.
 

Introduction
Food Pipe Line refers to a post-harvest system that deals with ensuring the delivery of a crop/commodity from the time and place of harvest to the time and place of consumption, with minimum loss, maximum efficiency, and maximum returns to all concerned including the grower, processors, and consumer. The term ‘system’ represents a dynamic, complex aggregate of logically interconnected functions or operations within a particular sphere of activity. The term pipeline refers to the functional succession of various operations but tends to ignore their complex interactions.
Stages of the post-harvest system
The food commodities broadly undergo different stages/operations of postharvest systems right from harvest to consumption. However, the applicability of different stages varies with the type of crop. Different unit operations involved in the post-harvest system of food commodities are as under:
1. Harvesting
2. Threshing (food grains, pulses and oilseeds)
3. Drying (food grains, pulses and oilseeds)
4. Collection, Sorting, grading, packaging (Horticultural Crops)
5. Transportation and distribution
6. Storage (Godowns, cold stores, CA stores)

A. Tomato and Tomato Products
Tomato though botanically a fruit is generally considered a vegetable because of how it is consumed. Commercial products from tomatoes include juice, puree, paste, ketchup, soup canned and dehydrated tomatoes. Processing of tomato is now practised from home scale level to large scale enterprise. As a semi-finished product, tomato puree is prepared on a small scale while at a large scale, tomato paste has gained commercial significance. Both puree and paste are used for the preparation of different finished products like ketchup, juice, soup etc. The method for preparation of these products is well standardized, however, some modifications concerning recipes are made in the processing plants owing to variations in the quality of the raw material. The methods for the preparation of different tomato products are discussed as under: -
I. Tomato Juice/Pulp
Tomato juice is an unconcentrated product consisting of a liquid with a substantial portion of the pulp, expressed from ripe tomatoes with or without the application of heat and the addition of salt. Tomato pulp/juice is the basic ingredient for the preparation of different tomato-based products such as tomato puree, paste, ketchup etc. Fully ripe tomatoes are used for the preparation of tomato juice/pulp. All green, blemished and overripe fruits should be rejected as they adversely affect the quality of the product. The juice obtained from overripe tomatoes is usually thin and unpleasant. The juice should be deep red in colour with a characteristic taste and flavour. The juice shall have about 0.4% acidity expressed as citric acid. Cane sugar (1%) is added to further improve the taste and flavour of the finished product.

Introduction
The food that has been damaged or has undergone changes so as to render it undesirable/unacceptable/unfit for human consumption is termed as spoiled. Spoilage of processed products is mainly caused by the action of micro-organisms and due to the physical or chemical changes. The reasons for microbial spoilage include under processing, inadequate cooling, contamination from leakage through can seams and pre-process spoilage. In under-processed cans (receiving low heat treatment), large number of different types of micro-organisms are expected to be involved in spoilage.
Causes of Food Spoilage
Food spoilage or deterioration may be described as loss of weight, softening, souring, rotting, wilting, moulding or a combination of one or more forms. The major causes of food deterioration are: biotic and abiotic factors.
A. Biotic Factors
1) Microbial spoilage (yeast, mould, bacteria)
2) Enzyme action (activities of enzymes present in foods)
3) Insect and rodent damage (attack of insects, rodents and parasites)

Mutation breeding is a method that uses physical radiation or chemical means to induce genetic variation in plants to develop new crop varieties. Mutation can be defined as a sudden heritable change in the character of an organism which is not due to either segregation or recombination. Mutation is the source of most genetic variation and the motor of evolution. It is a natural process, which occurs spontaneously and slowly over generations in plants, animals and all living beings. It involves alteration of their DNA, leading to the development of changes within the organism. Mutation may be sped up through the treatment of physical or chemical mutagens to achieve alteration in characteristics that are useful for the development of new variety of a plant species.
Spontaneous mutations
Spontaneous mutations are the net result of all that can go wrong with DNA during the life cycle of an organism (Glickman et al., 1986). Thus, the types and amounts of spontaneous mutations produced are the resultant of all the cellular processes that are mutagenic and those that are anti-mutagenic. Spontaneous mutations occur naturally without any apparent cause however, there are two possible sources of origin of these mutations.

High temperature stress
Abiotic stresses either individually or in combination cause morphological, physiological, biochemical and molecular changes that adversely affect plant growth and ultimately yield. The major forms of abiotic stress plants are exposed to in nature are heat, drought, cold and salinity. Of these abiotic stresses, heat stress has an independent mode of action on the physiology and metabolism of plant cells. High temperatures above optimal have generally damaging effects on plant development which has led to the prediction that Global warming have a negative effect on plant growth. High temperature regimes may cause severe yield reduction leading to even famine. High temperature stress has wide range of effects on plant in terms of physiology, biochemistry and gene regulation pathways. The susceptibility to high temperatures in plants varies with the stage of plant development and genotype.

Heat tolerance is generally defined as the ability of the plant to grow and produce economic yield under high temperature conditions. Several plant physiological parameters and mechanisms that contribute to heat tolerance in the field include:

Intellectual Property Rights (IPR)
There are two types of properties viz., i) Tangible, physical or material property and ii) Intangible or intellectual property. Intellectual property (IP) pertains to any original creation of the human intellect such as artistic, literary, technical or scientific creation. The tangible or physical properties are protected by the laws of land. In contrast, intellectual property is an idea, a formula, an invention, a design, a variety, etc. which= may give rise to a useful product. For obvious reasons the inventors would like to be rewarded and their inventions be protected from imitation. Such a right of an inventor to obtain economic benefit and protection of the invention from imitation is known as Intellectual Property Right (IPR). Thus, Intellectual property rights (IPR) refers to the legal rights given to the inventor or creator to protect his invention or creation for a certain period of time (Singh, 2008).
Why Intellectual Property needs to be protected?
Intellectual property rights (IPR) encourage innovation and protect the rights of the inventors in legalized form. It is an inevitable tool in today’s globalized economy. The invention of such things would require intellectual capacity, innovativeness and creative ability of the concerned person(s).

Sweet pepper or bell pepper, a cultivar group of the species Capsicum annuum under the family Solanaceae (Chromosome No. 2n =2x =24) is grown worldwide as green vegetable for its thick and fleshy fruits having delicate taste, pleasant flavour and colour. Sweet pepper requires slightly cooler climate than hot chillies. The fruits are generally non-pungent hence, it is commonly known as sweet pepper. It is also popular as bell pepper because of blocky fruit shape. China is the largest producer of sweet pepper in the world.
Origin, domestication and adaptation in India
Hot chillies and sweet pepper have originated from the wild and weedy species Capsicum annuum var. minimum whose domestication occurred in Mexico and distributed from the southern United states to northern south America. Domestication, cultivation and human selection brought about changes in fruit size and shape and fruit position from erect to pendant. It also resulted in more self-pollinating character due to inserted stigma unlike the exserted stigma in the wild types.

Cucumber, Cucumis sativus under the family Cucurbitaceae (Chromosome No: 2n = 2× =14) is grown throughout the world for consumption of fresh and tender fruits as slicing cucumber, and for pickles as pickling cucumber. Slicing cucumbers are usually larger and have thicker skins, while pickling cucumbers are usually smaller and have thinner skins. The flesh of cucumbers is rich vitamin C, and folic acid, fibre and a range of minerals including magnesium, molybdenum and potassium.
Origin, domestication and adaptation in India
The genus Cucumis, which includes cucumber (Cucumis sativus) and melon (Cucumis melo), has numerous wild African species, and it has therefore been assumed that
melon originated in Africa. For cucumber, this seemed less likely because wild cucumbers exist in India and a closely related species, Cucumis hystrix is available in the Eastern Himalayas. Using DNA sequences from plastid and nuclear markers for some 100 Cucumis accessions from Africa, Australia, and Asia, Sebastian et al (2010) concluded that melon and cucumber are of Asian origin and have numerous previously overlooked species-level relatives in Australia and around the Indian Ocean.

Abstract
All the technologies are applied from harvesting of fruits to its final consumption is called as post harvest technology. Development of processing industry takes care of surplus produce as well as of those fruits that are of lower quality. With the development of processing industry citrus fruits can be utilized for the production of wide range of commercial products. The large variability in physico-chemical characteristics of citrus fruits provides an opportunity to select desirable types for commercial exploitation. In India citrus fruit is available in large quantity that can be processed in to different processed products very easily. The fresh citrus fruits are not consumed in large quantity as fresh fruit due to high acidic in taste. The post-harvest technology including value addition would provide opportunity for commercial exploitation of the citrus fruits and leads to the marketing and processing in to quality products.

Cucumbers, muskmelons, watermelons, squashes, gourds, and pumpkins are commonly grown cucurbits in most parts of the world. Cucurbitaceous crops are the most important summer vegetables grown all over the world and it includes 118 Genera and 825 Species. Production and productivity of cucurbits are affected by the incidence of pests and diseases. Important pests attacking cucurbits are fruit fly, snake gourd semilooper, red pumkin beetles, hadda beetles/ epilachna beetles, pumkin caterpillar, vine borer/ clear winged moths, gall fly, serpentine leaf miner, shield bug, snake gourd bug and plume moth.
The melon fruit fly is distributed widely in temperate, tropical and subtropical regions of the world. It has been reported to damage 81 host plants and is a major pest of cucurbitaceous crops. The extent of loss varies between 30 –100 per cent depending on the cucurbit species and season. The adult is reddish brown with lemon yellow curved vertical markings on the thorax and fuscous shading on the outer margin of wings.
Biology: Eggs are white and cylindrical and laid singly or in clusters in cavities made with the ovipositor of the females on the fruits. The holes are sealed with gummy secretions, which solidify to form a shiny brown resinous material. Egg period is 1 to 2 days. The emerging maggots are apodous, dirty white, thicker at one end and tapering at the other and are seen within the fruits. Larval period is 7 days. The mature larvae emerge from the fruits and pupate in soil for a period of one week. Life cycle is completed in 15 to 20 days.

Okra, commonly known as lady’s finger is a significant vegetable crops primarily grown in tropics and subtropics. Production and productivity of okra is affected by the incidence of pests and diseases. More than 70 insect pests have been recorded in okra (Ewete, 1978).
Biology: Forewings of the moth white with a pea- green wedge-shaped band running medially from base to outer margin of each wing. Eggs are laid on tender parts of the plant, leaf axils, bracts, leaf veins, buds, flowers and fruits singly or in two’s or threes. Egg period - 3-4 days. Caterpillars are brownish with median longitudinal streak dorsally and pale yellow or green ventrally. Larval period is 2 weeks. Pupae are seen on the plant in dirty white boat shaped cocoons made of silk. Pupal period is one week. The life cycle is completed in about a month.
Nature of damage and Symptoms
The newly hatched larvae bore into the terminal shoots or fruits. The damaged shoots droop, wither and dry up. The infested fruits are deformed with holes on them plugged with excreta.

The chief functions of Clinical Microbiological laboratory are to examine and culture specimens for microorganisms, to make accurate species identification of important isolates and to perform antibiotic susceptibility tests when indicated. These tasks will assist physicians in the diagnosis and treatment of infectious diseases.

Once the specimen is received in the laboratory, the specimens are examined visually depending on the physicians order and the nature of the specimen. Wet mounts and smears may be prepared and stained for microscopic examination. Observations may or may not be immediately reported to the physicians depending on the definitiveness of the results. Timely information may often be used to establish a presumptive diagnosis and institute a specific course of therapy. Specimens that require definitive identification of potentially pathogenic microbes are processed further. All agar plates are streaked for colony isolation; then plates and broths. All cultures are placed in an incubator with appropriate temperature and environmental conditions to maximize the growth and replication of microbes. Often a presumptive microbial identificationcan be made. A final report should be delayed while subcultures and additional test procedures are performed to identify the organisms definitively.

Preliminary Identification of Unknown Bacteria
A number of techniques may be used in the direct microscopic examination of clinical specimens to demonstrate the presence of microbes The examination of wet mounts of unstained materials by phase contrast or
dark field microscopy is useful for demonstrating motility, spirochaetes and endospores. Giemsa, Wright or acridine orange stains may be helpful in observing bacterial forms that stain poorly or that have little contrast from
back ground material.
