1. Introduction

Food is an essential requirement for survival. We work hard to earn money so that we can feed ourselves. However, at the end of the day, many of us are unsure about the quality of food we consume. The allure of money, along with a general disregard for humanity, has resulted in the addition of adulterants to food ranging from simple stones in rice to the more harmful chemicals in food of daily use. Surprisingly, food fraud is not a modern issue. There are several references to fraudulent food behaviour as early as the Romans, but it is usually considered to be the Victorian who places food fraud on the map.

In recent years dietary supplements have gained attractiveness within fitness and wellness circles. The other commonly used terms areNutraceuticals, dietary supplements or wellness-focussed foods. Being highly nutritious they are associated with a number of potential therapeutic effects. Nutrient-rich ingredients like fruits, vegetables, nuts, seeds, and grains are often considered dietary supplements as well. Oats fibre called, beta glucan, which has been shown to reduce inflammation, enhance immune function, and perk up heart health.

1. Conventional and Non-conventional Dietary Supplements

Nutrient-rich foods like fruits, vegetables, and legumes are often considered dietary supplements. Meanwhile, modified foods have been fortified with micro and macro nutrients to boost health benefits of foods.

India's vast natural resources offer countless benefits, but centuries of human activity have taken a toll. Unsustainable practices and mismanagement have degraded the environment, threatening the well-being of communities across the country. The evidence of environmental decline is undeniable. Over the past decade, the situation has worsened. Our actions are pushing us towards a potential environmental crisis. India, like the earth itself, sustains a multitude of activities. This has undeniably improved lives, particularly in recent decades.

Introduction

It is the process of retaining food over a period of time without being contaminated by pathogenic organisms or chemicals and without losing its colour, texture, flavour and nutritious value. It involves preventing the growth of bacteria, fungi and other microorganisms, as well as retarding the oxidation of fats which causes rancidity.

Introduction

The process of concentrating a fruit juice / pulp, vegetable juice, medicinal plant extracts or milk to a reasonably thick consistency is called concentration. Thus, concentration is a water removal process from the liquid food materials. The basic principle of concentration is boiling the liquid under partial vacuum at low temperature till desired concentration is reached. With respect to water removal, the concentration process is similar to dehydration. The food concentration is distinguished from drying on the basis of the finished product where the final product called concentrate is still liquid. In concentration process, only liquid food is used while in drying both liquid as well as solid food can be used. Fruit juice concentrates, milk concentrate are valuable semi-processed products for use in the production of value added products like fruit juice beverages and fruit juice powders. Since the water content of single strength fruit juices is very high (about 75-90%), concentration of fruit juices not only provides microbiological stability but also permits economy in packaging transportation, and distribution of the finished product due to reduction in bulk by weight and volume.

Hydrological data visualization plays a crucial role in analyzing and understanding the behavior and characteristics of water resources. By visualizing hydrological data, we can gain insight into the distribution, variability, and trends of different hydrological variables such as river flow, precipitation, groundwater levels, and water quality parameters. This information can help decision-making in areas such as water resources management, flood forecasting, and climate adaptation.

R Language is a popular and versatile tool for hydrological data visualization, offering several powerful packages for data analysis and visualization. Each of these packages has its own strengths and limitations, which can be leveraged depending on the specific needs of a given analysis. For example, ggplot2 is an extensively used package for creating publication-quality static plots that are customizable and visually appealing. This package is based on the grammar of graphics, which provides a new plotting system that combines the benefits of both base and lattice graphics. ggplot2 can be used to create a wide range of plot types, including time-series plots, spatial maps, and scatterplots. It provides several options for customizing plot elements such as axis labels, legends, and plot themes. On the other hand plotly offers interactive and dynamic plots that can be easily shared and embedded in web applications. With plotly, we can create plots that allow for zooming, panning, and hovering over data points to display additional information. This package is mainly useful for exploring relationships between hydrological variables. In addition to these packages, hydroTSM provides functions for reading, manipulating, and plotting time-series data. hydroTSM can help us create time-series plots of variables such as river f low, precipitation, and temperature, with options for adding trend lines error bars, and annotations.

In recent decades, severe weather and climatic occurrences have become more frequent, affecting human populations across the globe. These changes are caused, in part, by anthropogenic climate change. Vulnerable communities are particularly affected by these rapidly changing patterns, which can have catastrophic consequences. To mitigate the impact of climate change, communities must have access to accurate and up-to-date climate information. Weather predictions, from short-term forecasts to long-term scenarios based on data from previous decades and centuries, can provide valuable information to socioeconomic sectors that are vulnerable to climate change. Climate services offer scientifically-based data and forecasts that can assist decision-makers in managing the risks of climate variability and change. Globally accepted indices generated from daily temperature and precipitation data can indicate the more severe features of climate change. These indices are developed and analyzed by the CCI/WCRP/JCOMM Expert Team on Climate Change Detection and Indices (ETCCDI) and have made a significant contribution to the Intergovernmental Panel on Climate Change (IPCC) Assessment Reports.

Introduction

Drought occurs when a region experiences below average precipitation, resulting in prolonged shortages in its water supply, which can have a significant impact on agriculture and the ecosystem. To reduce the effect of drought on farm production and stabilize farm income, farmers must take systematic measures called drought coping mechanisms. These measures can be categorized into two broad categories: Ex-ante coping mechanisms, which are taken before the occurrence of drought, and Ex-post coping mechanisms, which are taken after the occurrence of drought. Ex-ante coping mechanisms include activities such as crop, spatial, and varietal diversification, income diversification, and the use of savings. Ex-post coping mechanisms include changing consumption patterns, borrowing money, liquidating assets, seeking government drought relief funds, and migration. Drought can have a significant impact on crop and livestock production, causing farmers to adopt drought coping mechanisms to stabilize their farm income. This study goals to identify the factors that determine the adoption of such coping mechanisms, to mitigate the effects of drought on the livelihoods of farmers.

Agriculture ranks as the second-largest contributor to greenhouse gas emissions, accounting for 20% of the total, following the energy sector. Converting the agricultural waste from trash to treasure is very challenging issue for the researchers/scientists. The practice of indiscriminate dumping and burning crop residue poses serious human and environmental health risks and threatens food and energy security (Singh and Chauhan, 2022). Addressing crop residue burning requires strong technological interventions and policy support due to factors like labour scarcity, lack of appropriate technology and most important the short window of 15-20 days between harvesting and the next crop sowing. On-field burning not only degrades the environment but also leads to the loss of valuable nutrient content in crop residue. Agri-waste burning constitutes approximately 25% of total agri-biomass production globally, underscoring the urgent need to find economically viable alternatives to mitigate this issue and curb outdoor degradation. The scientific community is increasingly focusing on valorizing lignocellulosic-based agricultural waste for biofuel generation and industrial enzyme production. Given the pressing concerns regarding energy use and environmental degradation, there is a growing imperative to transition from non-renewable to renewable energy sources. Renewable energy has the potential to satisfy a significant portion of global energy demand by 2050. Leveraging lignocellulosic waste from agricultural systems is crucial for renewable energy generation and environmental sustainability. Agri-waste, composed mainly of cellulose, hemicellulose, and lignin, boasts high energy conversion efficiency compared to fossil fuel-based technologies. Effective agri-waste management techniques can address energy security and greenhouse gas emissions issues (Varjani et al., 2022). The sheer volume of agricultural residue globally, equivalent to around 50 billion tons of oil, highlights the substantial potential of agricultural biomass for energy production. Similarly, composting agri-waste offers an eco-friendly alternative to energy-intensive inorganic fertilizers, promoting sustainable agricultural crop production. Retaining or incorporating agri-waste into soil can enhance soil fertility and crop productivity (Yadav et al., 2019). Moreover, due to its diverse biochemical composition, agri-waste holds promise for various industrial applications.

For the majority of people on the planet, especially in developing and undeveloped nations, agriculture is their main source of income (Barragan Ocana and Del-Valle-Rivera, 2016; Guo and Liu, 2022). Additionally, agriculture provides majority of the world’s food and waste (Fróna et al., 2019). The environment, the agriculture sector, and ultimately the food chain are suffering irreversible harm due to the fast eroding agricultural soil (Chalise et al., 2019). Excessive waste production is one of the main issues of this sector (Bahrololoum et al., 2022). Failure to promptly manage this organic waste can lead to environmental contamination, endangering not only human health but also the well-being of other organisms. Additionally, its wastes resources nutrients, water, and land (Munir et al., 2018).

Agricultural and food wastes pose a multifaceted challenge with far-reaching implications. The staggering amount of waste generated annually not only burdens the environment but also strains economies and impacts societal well being. With the continually increasing demand for agricultural products, this issue becomes even more pressing (Gustavsson et al., 2011). Agricultural and food wastes contribute to reduction of greenhouse gas effect, soil and water pollution, and conservation of biodiversity. Improper disposal methods, such as open burning or dumping, exacerbate these problems. Moreover, the resources invested in producing these wasted goods, such as water, energy, and land, are essentially squandered. From an economic standpoint, the mismanagement of agricultural and food wastes shows loss of potential value. These wastes could be utilized for various purposes, such as energy generation, composting, or animal feed, thus creating opportunities for economic growth and innovation. Food insecurity remains a pressing issue in many parts of the world, yet a substantial portion of food produced is lost or wasted. Redirecting these surplus resources to address hunger and malnutrition could have significant social benefits, enhancing food security and improving quality of life for millions. Incorporation of sustainable farming practices to minimize waste generation, improving harvesting and post-harvest techniques to reduce losses, promoting circular economy principles to maximize resource efficiency, and raising awareness among consumers about the importance of reducing food waste. Development of new waste-to-energy technologies, biodegradable packaging alternatives, or novel methods for converting waste into valuable products. Ultimately, by mitigate its adverse effects on the environment, economy, and society, while simultaneously creating opportunities for a more sustainable and resilient future.

Introduction

Agricultural organic waste residues pose a significant challenge in India, generating approximately 700 million tonnes annually, with agri-residue trash reaching around 998 million tonnes per year (Kannan and Kallapiran, 2022; FAO, 2022). These wastes, including sugarcane bagasse, paddy and wheat straw, husk, vegetable and food waste, jute fibers, crop stalks, and other materials, often face improper disposal methods such as burning or dumping, which contribute to environmental pollution and health hazards (Singh et al., 2020; Sharma and Patel, 2019). Proper management and treatment of agricultural waste are crucial for sustainable agriculture and environmental protection (Kumar et al., 2021). Composting is a cost-effective biological treatment that converts these residues into valuable resources like plant nutrients, reducing the carbon-to-nitrogen (C:N) ratio and enhancing soil productivity (Kannan and Kallapiran, 2022; Gupta et al., 2020). Aerobic microbes play a key role in breaking down complex organic materials during the composting process, leading to ecological succession of microbial communities. This transformation can be measured through various quality and stability indicators, such as the C:N ratio, temperature, pH, moisture content, and the presence of pathogens like coliform bacteria (FAO, 2012; Patel and Verma, 2021).

Understanding gender requires not only defining its conceptual framework but also acknowledging how these concepts manifest in everyday life, often creating deep divisions. Gender divides whether in education, employment, health, or political participation are enduring realities that reflect the unequal distribution of opportunities and rights between men and women, as well as between those who identify beyond the binary. These divides are more than social phenomena; they have concrete economic, political, and developmental impacts. Recognizing the persistent gaps in access and outcomes between genders has led to the development of gender-sensitive policies, such as gender budgeting. Gender budgeting is a critical tool for addressing these divides by ensuring that public resources are allocated equitably to benefit all genders. By focusing on the differential impacts of policies and budgets on women, men, and gender minorities, governments and organizations can work toward creating more inclusive and fair societies.

This chapter will introduce key gender-related concepts that form the foundation for understanding how gender influences social, economic, and political life. It will explore the roots and ramifications of gender divides across various sectors and explain how gender budgeting is employed as a strategic approach to reduce these disparities. Through this exploration, we will highlight the importance of integrating gender perspectives into policy and resource distribution to foster equity and social justice.

These skills have developed and progressed over the centuries to the point that, in recent decades, we have been able to build machines that can imitate our intelligence, as far as we comprehend it. A novel type of world may lie ahead of us.

Artificial intelligence (AI) refers to the replication of human intelligence in computers, which are programmed to think and behave in a manner similar to humans. Literacy, logic, problem-solving, perception, and linguistic appreciation are all manifestations of cognitive abilities. Artificial Intelligence refers to the development of computer systems, computer-controlled robots, or software that are designed to exhibit intelligent behavior similar to that of the human mind. The term artificial intelligence is composed of the word "Artificial," which denotes something created by humans rather than existing naturally, and "Intelligence," which refers to the capacity to gain and utilize knowledge and skills.AI is achieved by the analysis of patterns in the human brain and the evaluation of cognitive processes. The culmination of these studies leads to the creation of sophisticated software and systems with advanced intelligence. The term AI was coined by McCarthy et al. 2006 while working on Dartmouth summer research project in which they proposed that machines have the capability to emulate "every facet of learning or any other characteristic of intelligence."

Potato, the third most important food crop in the world after rice and wheat is becoming the main source of food and income in developing countries. India stands second in production and area of potato in world after China leaving behind the Russian Federation. In India, potato is an important component in cereal and vegetable-based cropping systems for its ability to produce high dry matter/ha in short duration and high yield compared to cereals. It is grown as mixed crop, intercrop, relay or sequential crop along with other vegetables, cereals and cash crops.

Potato is originated in South America in the high Andean hills and towards the end of 16th century it was first introduced into Europe by Spanish conquerors. In the early 17th century, it was brought to India by British missionaries or Portuguese traders. Thus, potato developed as a temperate crop and was later distributed throughout the world. Cultivated potato consists of two sub species, Solanum tuberosm ssp. andigena and S. tuberosum ssp tuberosum. Subspecies andigena is the primitive form which is adapted to shorter day length and high altitudes of mountains (above 2000). The presently cultivating tuberosum subspecies is adapted to long or short day condition of tropical regions and lower altitudes (500-200m above MSL) and is believed to be evolved from andigena types through selection.

Morphology and Floral Biology

Potato is herbaceous in nature with erect to prostrate stem. Stem is variably coloured from green, purple or mottled green or purple. Leaves are pinnate which ends in single terminal leaflet. Stolon arise from the portion of the plant below the ground. The stolon bears rudimentary leaves and tip is hook shaped. The sub apical portion at the tip of stolon enlarges to produce tubers. Hence, potato tubers are the modification of underground stem with shortened axis and poorly developed eyes. The leaf scar with a subtended lateral bud having underdeveloped internodes is referred to as the eye of the tuber. Potato is a long day plant. Moderate humidity and long day condition favours flowering. Hence flowering and fruit set is observed in hilly tracts. Inflorescence is produced terminally and is usually cymose. Flowers are bisexual, actinomorphic, and hypogynous with 5 calyx, 5 corolla and 5 stamens. The colour of corolla varies from white, pink, lilac, blue and purple. Pollen shedding is through the pores at the tip of the anthers. Mature fruit is a berry. Self-incompatibility is observed in diploid species and tetraploids are self-compatible.

For a researcher, laboratory is another home where he/she spends much time every day. As we take care of cleanliness, safety, and design of our home, we must take care on these aspects of laboratory too. It is the responsibility of the laboratory personnel to ensure cleanliness/safety of the laboratory. Since every laboratory chemical and equipment have the potential to cause harms if not used with appropriate precautions. Hence, as a laboratory user, it is our responsibility to follow the basic safety/biosafety rules and regulations set up by the Principal Investigator of the laboratory, Institutional Biosafety Committee, as well as by other regulatory authorities, if any. We must be aware of the general/personal protective measures, cleanliness and laboratory waste disposal prior to joining a research laboratory. In this chapter we will briefly discuss about personal safety, chemical safety, cleanliness, waste disposal, etc.

A. Personal Safety

1. Personal Protective Equipment (PPE)

Personal protective equipment (PPE) is special arrangement to protect the worker from specific hazards because of using a hazardous substance. PPE does not reduce or eliminate the hazard, but protects the wearer from exposure to hazardous material. PPE should not be reused or brought outside the laboratory as these might increase the risk of spread hazardous material or contamination. Used PPE must be kept inside the laboratory in a designated waste storage area adjacent to the work area.

Definition

• Feedback is defined as the action reaction interdependence in communication.

• The return to the input of a part of the output is the feedback.

• Feedback is the reaction on the part of the receiver to a sender's communication.

Feedback or response of the audience is the ultimate objective of any communication process or function. Response of an audience to message received may be in the form of some kind of physical or mental action. Until the desired action results, extension communication does not achieve its most essential objectives. The response of the audience (whether in the form of action or reaction) can be used by a communicator as a check of his own effectiveness and a guide to his own future action. When a source receives feedback, that is rewarding, he continues to produce the same kind of message. When he gets non-rewarding feedback, he eventually will change his message. Schramn (1955) points out that each person in the communication process is both an encoder and decoder. He receive and transmits. However, a person will decode a message and interpret it in accordance with his own experience.• Feedback means carrying out significant responses of the audience back to the communicator.

Communication is the fundamental process of conveying information between two or more individuals or within a group. Communication process involves distinct components: a sender, a recipient, a message, and a medium through which the message is transmitted. Importantly, the exchange of a message frequently carries emotional and cultural connotations. Variations in perception and interpretation among recipients may result in disparities between the intended message of the sender and its actual understanding by the receiver, thereby underscoring the nuanced nature of communication dynamics

Intra-personal Communication

Intra-personal communication involves an individual engaging in self-talk or internal dialogue. This process is an unconscious act inherent to all human beings, wherein individuals contemplate various plans and problems of daily life within their minds. People often discuss matters internally before sharing them with others or documenting them. Intra-personal communication is so ingrained in our everyday lives that it often goes unnoticed, yet it is the fundamental form of communication. All communication originates in the human mind before being expressed in interpersonal, group, or mass communication.

Inter-personal Communication

Inter-personal communication occurs between two individuals, involving one person talking, discussing, or arguing with another. This one-to-one interaction can take many forms, such as casual conversations between friends, information exchange, persuasion, problem-solving, counseling, or simple chatting. This method is widely used in extension work, particularly with poor farmers who are often illiterate and have limited access to other modes of communication. Despite being time-consuming, inter-personal communication allows for meaningful interaction between farmers and extension workers, facilitating mutual understanding and ensuring the accurate transmission of information through feedback.

Introduction

Regenerative agriculture is both a philosophy and a strategy for land management. It asks us to consider how all aspects of agriculture are connected through a web, which is a network of entities that grow, enhance exchange, and distribute, consumer products and services. Traditionally, supply chains have been organized linearly. It is about farming and ranching in a way that nourishes people as well as the earth, with specific practices differing from grower to grower and from region to region. This style of farming and ranching is also known as “permaculture.” Although there is no definitive rule book, the holistic principles that underpin the dynamic system of regenerative agriculture are designed to address issues of inequity, reestablish the health of soil and ecosystems, and ensure that our land, waters, and climate are in better condition for future generations. It is a novel concept of uplifting the natural world rather than imposing an invasive control, regenerative agriculture intriguing environmental approach to agricultural production that enables the natural systems to renew themselves. Regenerative agriculture refers to farming practices that, in comparison to industrial agriculture, cause significantly less damage to the surrounding environment and the soil. When we give more to nature than what we receive from it, we bring nature closer to us and bring ourselves closer to nature at the same time. Farming that is in harmony with both the surrounding environment and the community fosters a feeling of integrity and togetherness that helps to strengthen the connection between the two. The concept of harmonious farming can be summed up in a few words: It involves engaging in agricultural practices and cropping systems that increase soil fertility return nutrients to the soil, increase soil water retention, remove carbon dioxide (CO2 ) from the atmosphere, and, most importantly, adapt to the ecosystems in which they are grown.

The term “Integrated Farming System (IFS)” (or simply “integrated farming”) is a term used frequently and generically to describe a method of farming that is more integrated than monoculture methods. By virtue of the intensification of crops and related industries, an IFS offers the chance to enhance economic yield per unit area per unit time. This is accomplished through the system’s use of several crop rotations. It improves the efficiency of fertilizers and natural resources, improves the recycling of nutrients, and contributes to increased food security. The IFS technique promotes ecological intensification by lowering the amount of anthropogenic inputs while simultaneously enhancing the performance of ecosystem services such as the recycling of nutrients, the creation of soil, and the soil’s fertility. IFSs that are well- managed are seen to be safer than those that are not because they benefit from synergy among businesses, diversification of crops, and ecological stability (Behera et al., 2015). It requires paying attention to the minute details and constantly striving to improve in all facets of agricultural production through well- informed administrative practices. The IFS approach is widely regarded as the most important strategy for enhancing the nutritional status of families and ensuring the viability of their livelihoods. The research strategy that is centered on crops and cropping systems needs to give way to the research strategy that is based on agricultural systems, especially for smaller farms (Jha et al., 2011). Recycling of waste and increased effectiveness in terms of land utilization are two essential components of the IFS. The components and enterprises that make up the IFS might differ from region to region. This is because agroclimatic conditions, such as the kind of land, the availability of water, the socioeconomic standing of farmers, and market demand, all play a role. For effective holistic agricultural systems to be constructed, there must be strong connections and complementarities between the various components (Bell et al., 2014). Integrating land- based businesses into the biophysical and socio- economic contexts of farmers, such as aquaculture, poultry, duckeries, apiaries, as well as field and horticultural crops, is essential in the IFS to make farming highly profitable and reliable (Behera et al.,2004: Kashyap et al., 2015). Farmers who are limited in their access to resources can achieve sustainable output through the careful administration of agricultural residues and the distribution of limited resources

The simultaneous cultivation of two or more crops in the same field is known as intercropping. Sustainable agriculture aims to at least build agricultural systems that are inspired by nature. Efficiency and the idea that there are no waste products in nature are key components of sustainable agriculture since nature incorporates plants and animals into a variety of landscapes. When domesticating crops replaced hunting and gathering, the landscape became altered. Due to humankind’s limited ability to produce a wide variety of agricultural plants and livestock, the amount of biological diversity throughout a large portion of the planet has significantly decreased. In nature, cooperation predominates over competition. Mutually beneficial interactions between species within groups are one example of cooperation. A few types of creatures may initially inhabit an abandoned agricultural field if it is left unattended and unplanted, but over several years, a complex community made up of numerous wild species emerges. When a community reaches a high level of variety, it becomes stable. Diverse communities are stable and have fewer swings in species abundance. Enterprise diversification, crop rotation, the use of windbreaks, the provision of more habitats for microorganisms, intercropping, and the integration of crop farming with animal production are methods that increase diversity and stability on the farm (Reddy and Willey,1981; Reddy et al., 1992). Each crop should have enough room while growing with another one or more to enhance cooperation and minimize competition. This is made possible by the elements of spatial layout, plant density, crop maturity dates, and plant architecture. The spatial arrangements are Row intercropping— Growing two or more crops together at the same time with at least one crop planted in rows; Strip intercropping— Growing two or more crops together in strips wide enough to separate crop production using machines, but close enough to interact; Mixed cropping— Growing two or more crops together in no distinct row arrangement; Relay intercropping— Plant a second crop into a standing crop at a time when the standing crop is at its reproductive stage but before harvesting.

Nowadays, horticultural fields are expanding due to the increasing demand for various utilizations. Increased production is leading to an increase in exports. The global horticulture market value of about 20.77 billion USD was estimated in 2021 and targeted to attain 40.24 billion USD by 2026 (Global Market Estimates, 2021). From the production of horticultural foods, various factors are involved in the hazardous environmental appearance. Uncontrolled use of pesticides and residual effects of various chemicals initiate the primary threats to nature by creating a negative impact on soil, water, humans, animals, and wildlife species too (Sanchez-Bayo, 2011). Alone agricultural practices are not responsible for the production of horticultural wastes some other aspects are also included such as horticultural food processing industries as well as urban and peri-urban wastes. Food processing is an important sector of agriculture. Being highly perishable horticultural food processing became more necessary to increase the self-life as well as the value addition of these crops. But at the same time, these food processing industries where several processes such as production, processing, and preparation of food take place again result in the generation of huge quantities of waste material causing health hazards due to environmental pollution. The huge waste of food is due to a lack of control and ignorance of higher officials in this agro-economic sector. Another important source where waste management is equally important is Urban and peri-urban areas. Being a sink for horticultural produce (raw or processed) creates huge waste at the same time. The urban population is increasing between 3% and 3.5% per annum and the yearly increase in waste generation is around 5% annually (Agarwal et al., 2005).

Seed technology improves seed genetics and physiology. Variety creation, release, seed production, processing, storage, and certification are included. (Feistritzer, 1975). Organic farming began in the early 20th century due to constantly changing farming practices. Over 50 million hectares of certified organic agriculture are in Australia. “That discipline of study having to do with seed production, maintenance, quality and preservation” is seed technology. Organic seeds are fully produced with organic matter practices made with proven organic function and natural seed production, including seeding plants, with a set of guidelines prohibiting the use of manufactured products or chemicals to be sold as such. They must be produced by an accredited institution by an authorized person government agency. Organic seed is created by a planted crop and organically raised at least one generation for annual crops and two generations for annual and perennial plants. Organic farming is sustainable and eco-friendly. Farming needs better norms and standards to achieve biological goals. It is usually cold and people need lots of vegetables but have few organic, clean supplies. Organic farming in India needs a certain space and high-yield vegetable crops in national marketplaces to produce high-quality products. Indian agriculture uses chemical fertilizers, which can be minimized. Experiments have shown that it works well in conjunction. Inorganic and biological fertilizers boost yields, soil quality, and productivity.

Water retention is an important soil hydraulic property that affects how soil operates in an ecosystem and how it is managed. Hydrology, agronomy, meteorology, ecology, environmental protection, and many other soil-related professions employ soil water retention data. Some soil survey programs measure water retention. A soil survey can estimate water retention from other soil properties. However, these measurements are problematic during project design and in large-scale implementations (Rawls et al., 1991; Wo sten et al., 2001) since agricultural land needs rise periodically. Agriculture is using dry land. Food self-sufficiency and becoming a world food barn by 2045 necessitate agricultural land expansion (Mulyani and Agus, 2017). Water concerns afflict farming in this agroecosystem (Syam et al., 1996; Mulyani and Agus, 2017). Because of soil composition, much water stays in the earth. Tang et al. (2022).

For plant growth, soil water retention variables indicate how well the soil holds water. The dirt provides most of the plant’s water. Water in root layer dirt pores is absorbed by plants. Thus, soil water retention is the key factor affecting plant development and productivity. Plants can take in the soil pores’ water between the field capacity and the point where they always wilt. Field capacity occurs when the matrix potential and gravitational potential match. The most significant component for plant growth is soil water (Tang et al., 2022, Deng et al., 2016, Su et al., 2020). The soil’s physical features determine plant water availability. The amount of water available depends on clay minerals, organic matter, absorbed cations, soil texture and structure, and water availability. Thus, to prevent plants from experiencing water or groundwater stress, soil physical attributes must be investigated to determine groundwater availability (Kirkham 2023). Infiltration is crucial to groundwater availability. The amount of water that can penetrate the soil depends on its physical features, such as soil texture, organic matter, bulk density, porosity, aggregate stability/stability, and water content. Thus, soil water availability depends on its physical qualities, particularly its ability to absorb and transfer water. The physical properties of saturated soil affect how water travels through it, which affects runoff and infiltration (Sauer and Logsdon 2002).

The process of recycling involves the conversion of waste materials into reusable products or materials and aims to reduce the consumption of fresh raw materials, minimize energy use, and mitigate trash creation. The primary objective of recycling is to effectively preserve finite resources, safeguard the natural environment, and mitigate the volume of garbage deposited in landfills or subjected to incineration (Lienig et al., 2017). Recycling refers to the systematic transformation of discarded materials into fresh resources and tangible products. The aforementioned term often encompasses the process of extracting energy from waste materials. The recyclability of a material is contingent upon its capacity to regain the characteristics it has in its initial form. There exists an alternative approach to garbage disposal that has the potential to save resources and mitigate the release of greenhouse gases. Additionally, it can mitigate the waste of potentially valuable resources and diminish the use of pristine raw materials, therefore reducing energy consumption, air pollution resulting from incineration, and water pollution stemming from landfill practices. The promotion of environmental sustainability is achieved by the removal of raw material input and the redirection of waste output within the economic system. The increasing volumes of trash have given rise to several environmental challenges, including air pollution, water pollution, soil contamination, and biodiversity loss. The emission of diverse greenhouse gases from solid waste landfills also contributes to the phenomenon of global warming. At now, the predominant techniques for solid waste disposal are open dumping and landfilling. Various alternative techniques, such as pyrolysis, gasification, anaerobic digestion, composting, and bio-methylation, are used to extract valuable resources from solid waste materials (Griffin et al., 2018).

Reviving the agricultural economy is a crucial endeavor with far-reaching implications for food security, economic prosperity, and sustainable development. Several key strategies can be adopted to achieve this goal. First, policymakers must prioritize agriculture by providing necessary f inancial support, infrastructure development, and research and development investments. Adequate credit facilities and subsidies can help farmers access essential resources and modern technology, boosting productivity and efficiency (Asian Development Bank, 2018). Promoting sustainable agricultural practices is vital to ensure long-term viability. Encouraging the adoption of eco-friendly methods such as organic farming, crop rotation, and water-efficient irrigation can enhance environmental resilience while safeguarding natural resources for future generations. Empowering farmers through training and education is essential. Equipping them with the latest knowledge and techniques enhances their capacity to adapt to changing conditions and make informed decisions about crop selection, pest control, and market opportunities. Furthermore, enhancing market linkages is critical to connect farmers with consumers and ensure fair prices for agricultural produce (African Development Bank, 2022). Developing efficient supply chains and reducing post-harvest losses can improve income prospects for farmers and attract more youth to the sector. Lastly, encouraging private sector involvement and investment in agriculture can accelerate growth and innovation. Public-private partnerships can create opportunities for technological advancements, value addition, and market expansion (Liu & Lee, 2018). Reviving the agricultural economy requires a collaborative effort involving governments, farmers, the private sector, and civil society. By addressing challenges, investing in modernization, and promoting sustainable practices, nations can create a thriving agricultural sector that contributes to food security, economic development, and environmental sustainability (Brown, 2021).

Introduction

A teacher uses different aids in addition to lectures for effective teaching. Similarly, a trainer uses different training methods to make learning effective. In Agricultural Extension the extension worker as a teacher has to design and use appropriate teaching methods depending upon the group to make the teaching effective. According to Leagans (1961) “extension teaching methods are the basic and proven devices used to create situations in which communication can take place between the instructor and the learner.” Extension methods are powerful tools for extension workers to effectively communicate certain messages. Some studies suggest that the adoption of innovations by the farmers requires different teaching methods at different stages of learning. These methods are required for imparting new knowledge and skills to the farmers to adopt new practices for their increased production and income. The choice of extension teaching methods depends on the target audience, location, and availability of time for teaching.

Classification of extension Teaching Methods

Extension teaching methods are classified according to use, form, and function as shown in Table 4.1.

The extension methods could be individual or interpersonal, group contact, or mass contact as shown in Figure 4.1.

Individual contact methods: Individual methods provide face- to- face contact with individuals. Those techniques are very effective in teaching new technologies and creating goodwill among farmers and extension people. When few people are to be contacted and they are at a close distance, the individual methods are effective. The extension worker contacts directly to an individual and gets his feedback through different means like personal visits, telephones, SMS, etc. The individual contact method is useful for rapport building and easy to obtain feedback. But the method is time- consuming and quite expensive.

Approaches in Extension

Agricultural extension services have gone through various stages over the years, from the individual farm visits approach to the T&V approach. All these approaches are characterized to a greater or lesser extent, by a “ top- down” planning. Extension approaches mostly determine the direction and nature of the system in terms of structure, leadership, program, methods and techniques, resources, and linkages. Extension approach is a style of action within a system which embodies the philosophy of the system. Although there are many approaches to agricultural extension, there is certain commonality in them. All approaches function through non- formal education and all have agricultural content for the development of rural people.

Ministry- based General Extension

Ministry of Agriculture was entrusted with agricultural extension in a top- down manner for planning for the adoption of technologies. An increase in national production is taken as the measure of success.

All persons engaged in agriculture are the clients of this public extension who are served by extension staff. Program formulation and implementation are guided by public interest. Ministry- based extension faces difficulty in serving the majority of potential clientele and financial constraints that force it to reduce the staff. Whereas extension demands location- specific technologies and flexible decisions, the university extension is mostly top- down in nature. As the approach lacks a two- way approach the messages are not location specific. Production alternatives are absent in this approach.

Extension Program

Planning an extension program involves decision- making about the work of the organization. Extension program planning covers a set of objectives to be achieved by various activities included in the planning. Extension organization needs to decide the goal it aims at, the target group, the content of extension message, its use, and organization of all activities. The program includes situation analysis, and an action plan for solving people’s problems which is drawn in advance. Extension workers have to decide the goals, target group, messages, extension methods, and media and organization of activities. While setting the goal, the perception of the present situation and the vision of the desired situation should be borne in mind. The target group is normally larger than the extension worker contacts directly or through mass media. The target group can be contacted indirectly. The extension content depends on the goal, the target group, and the extension strategy. The content should be so selected that it can be implemented with the resources available to the farmers locally. A combination of extension methods need to be used. The extension program needs to be flexible and can be easily implemented by the organization.

Extension Program Planning

Extension program planning indicates an account of the activities to be undertaken by the organization.

The essential phases of program planning in extension are analyzing the situation, setting goals and objectives, identifying problems and gaps, developing work plan, implementation, monitoring and evaluation, and reconsideration.

 

Introduction

“Quality” refers to the aesthetic appearance and freshness of fish. It also involves safety aspects such as being free from harmful bacteria, parasites or chemicals. The best quality fish is the one consumed within the first few hours after postmortem. We studied in our previous chapters that in some instances, even very fresh fish in rigor mortis are unsuitable for filleting. So, slightly older fish in post-rigor are more desirable for the processors.

The assessment methods of fish quality are divided into sensory, instrumental, chemical and microbiological. Sensory method is superior and all other methods must correlate with the results of sensory evaluation. So, sensory method must be done more scientifically under controlled conditions without the effects of test environment, personal bias, etc.

4.1. Sensory Methods

Sensory evaluation is defined as the scientific discipline used to evoke, measure, analyze and interpret reactions characteristics of fish, as perceived through the senses of sight, smell, taste, touch and hearing. There are few instruments capable of measuring sensory profile viz. Instron for texture, electronic nose for odour, microscopic imaging for structure, etc.

In sensory evaluation, appearance, odour, flavour and texture of fish are evaluated by the human senses. The process involves three steps: (1) detection of a stimulus by the human sense organs, (2) evaluation and interpretation by a mental process; and (3) the response of the assessor to the stimuli. The response of stimuli varies among individuals e.g. some people cannot taste rancid flavour and some have low response to cold-storage flavour.

Where there is water, there is fish. India is country accounts 4.2 percent of global water and has competitive advantage in fisheries production. But, unfortunately the sector has been upholding the tag line of fishy (something unpleasant) in spite of its importance in food, income, society and health1. Even, the livelihood of backward communities near to the seashore and other water basins cannot be ignored and could be strengthened by enriching their life through fisheries sector development who will be a barricade for the intruders in future. Panigrahy & Nayak (2023) highlighted that sustainable Development Goal also emphasized upon the importance of fisheries in various segments like no poverty (SD 1), zero hunger (SD 2), good health and wellbeing (SD 3), gender equity (SD 5), responsible consumption and production (SD 12), and climate action (SD 13). Day by day the country has also improved its export share both in volume and value through fisheries that stimulate employment, investment, consumption, and future income of the people who integrate them with fisheries. However, fisheries in our country have been facing the tragedy of commons, conflicts, and loss of biodiversity due to target fishing in absence of effective market intelligence on which the complete business ecosystem of the stakeholders are revolving round through day and night.

Food and Agriculture Organization (FAO) in its report highlighted that marine f isheries consumption suits the developed country whilst inland fisheries for developing and underdeveloped one according to the consumer surplus and disposal income is concerned (FAO,2014). Even growing consumer surplus also triggers protein consumption over carbohydrate that stimulates more fish consumption in future in our country as well. Study says, fish can be taken with rice as better lysine content of former compensate in diet of the consumer. In this juncture, fish as a functional food has an immense importance across the country where marine fisheries target to Southeast Asia, China, European country, Japan, and US and Inland fisheries find its customers in the national sphere2 (Panigrahy, Vahoniya & Kumar, 2017).

The global aquaculture production in 2020 was recorded at 122.6 million tonnes, aquatic animals contributing 87.5 million tonnes and algae 35.1 million tonnes, with a total value of USD 281.5 billion. About one-third of this production comes from farming of the marine species. Asian countries dominated the world aquaculture by producing 91.6 % of the total (FAO, 2022). With 14.16 million metric tonnes production in 2019-20, India is the world’s second-largest aquaculture producer next to China, accounting for 7.56 % of global production. It contributes about 1.24 % to the country’s GVA and over 7.28 % to the agricultural GVA. During 2019-20, India has exported 12.89 lakh metric tons of fisheries products valued at Rs.46, 662/- crores (USD 6.68 billion). The major farmed species in India are the Pacific white shrimp Litopenaeus vannamei and Indian Major Carps (IMC). While issues related to freshwater scarcity and pollution will slow the growth of freshwater aquaculture in coming years, mariculture has been identified as an area of high growth opportunity.

Globally, an estimated two billion people suffer from micronutrient malnutrition and one billion calorie deficient. Thus, providing adequate nutrition to the growing population is a global challenge. Fish currently provides 17% of the world’s animal protein, and exceeds 50% in the diets of many least-developed countries (FAO, 2022). One of the most documented nutritional benefits of seafood is the health benefits of unsaturated fatty acids in marine fish and their contribution to brain development, metabolic function, and the prevention of cardiovascular diseases. Seafood also provides essential micronutrients that promote support growth and development, especially in children and pregnant women (FAO, 2022). The proportion of fish eating people in India has been grown from 27.7% in 1987-88 to 50 % in 2015-16. The annual per capita consumption of fish for the entire population was estimated at 5-6 kg, whereas for fish eating population it was found to be 8-9 kg (Shyam, 2016). Assessment of the present trend shows that to meet the increasing demands from the domestic consumers and to cater to the export market, fish production has to come mostly from marine sector only. It is therefore considered that mariculture is the only option for production enhancement from marine sector.

Aquaculture and Fisheries remain important sources of food, nutrition, income, and livelihoods for hundreds of millions of people around the world including in India. Total fisheries and aquaculture production reached a record of 214 million tonnes in 2020, comprising 178 million tonnes of aquatic animals and 36 million tonnes of algae (FAO 2022). Global aquaculture production continued to grow amid the worldwide spread of the COVID-19 pandemic. Global aquaculture production consisted of; 87.5 million tonnes of aquatic animals predominantly used as food for human consumption; 35.1 million tonnes of seaweeds and other micro-algae for both food and non-food uses. Global consumption of aquatic foods has increased significantly. In 2019, global aquatic food consumption was estimated at 158 million tonnes and consumption increased at an average annual rate of 3.0 percent from 1961, compared with a population growth rate of 1.6 percent. In India, the total fish production during the year 20-21 is estimated at 14.73 Million Metric Tonnes (MMT) with a contribution of 11.25 MMT from the inland sector and 3.48 MMT from the marine sector. The fisheries sector contributes about 1.24% to the gross value added (GVA) and 7.28% to the agricultural GVA. In India, the changing consumer preferences, advancements in technology and income growth are the real drivers that augur well for further expansion and demand of food from aquatic origin. Against this backdrop, this sector is poised for unprecedented growth and opening various avenues of entrepreneurship.

With increasing fish culture activities several bacterial diseases causing morbidity and mortality in fish have been reported in tropical and subtropical aquaculture systems. Common and major diseases are due to motile aeromonads, Vibrios and Pseudomonas. However, bacterial diseases of minor nature have also been reported from aquacultural systems. In the last two decades several new diseases due to Streptococcus sp, Edwardsiella and Ricketsia have also emerged.

Bacteria can cause disease either as primary pathogens or as secondary opportunistic invaders. Bacterial diseases in fish can be broadly classified as surface ulcerative, acute systemic and chronic granulomatous types (Table 1, Plates 4 and 5). Surface ulcerative types of diseases are characterized by hemorrhagic surface ulcers and are caused by species of Aeromonas, Pseudomonas, Vibrios, Flexibacteria and Myxobacteria. Surface ulcerative disease conditions at times develop to acute systemic disease. Acute systemic disease are characterized by the presence and proliferation of bacteria in internal organs like kidney, heart, spleen, blood and other visceral organs. These diseases produce significant necrotic changes in all affected organs and can cause mortality in a short time scale. Bacterial hemorrhagic septicemia caused by Aeromonas hydrophila is a major problem in carp farms. Chronic granulomatous type of disease conditions are characterized by the formation of granulomas or nodules with the initiating bacteria in the centre. These conditions will not produce mass mortality but can produce chronic low levels of mortality and can significantly reduce growth.

Fish is the cleanest animal, gets bath 24 hrs a day provided water is clean without any toxic material. Perhaps this was the scenario world over 5 decades ago. However, in the last few decades due to industrialisation, modernisation of agriculture and animal husbandry, human health care industry and city developments all have contributed to toxic material to water endangering the fish and the consumer, leave alone clean environment. In recent years, even intensive aquaculture also add several chemicals, pesticides, antibiotics contributing to pollution. Natural water bodies such as rivers, lakes, reservoirs, scoastal/marine waters are ultimate receivers of pollutants which also serve as the source of water for aquaculture. Although pollution control by treatment measures and awareness have improved over the years still there is a long way to achieve the clean water. Effect of toxins in aquaculture has multiple angles, differing from that of toxins on land animal. Fish depends heavily on water for respiration, physiology, reproduction, food and feeding and its very sustenance- as a supporting medium.

Aquaculture is expanding world over growing at 6-8% gradually involving more areas and species contributing a major share to total fish production with gradual decline in capture fisheries from the natural water bodies. Invariably, most of the natural water bodies are polluted with one pollutant or the other in the country. In addition, several pollutants are added to the system by various aquacultural practices. Although large quantity of information is available on aquatic toxicology, toxicology in aquaculture from health point view of fish and the consumer is meager and not focused. Against this background, it is very important to study, understand various toxicants, their mode of action, accumulation and effect on fish and the consumer. Toxicology in aquaculture is incomplete unless it includes or addresses safety of the consumers. Further, poisoning of fish in farms and wild deliberately or otherwise needs forensic studies/approach to address the issues.

Introduction

Nucleic acid based diagnosis is highly specific, sensitive and rapid method widely used in health management. The detection is mainly based on structure and sequence of bases of nucleic acid which are unique to an organism. In recent years, nucleic acid based diagnosis is becoming common and popular in fish and shell fish health management. Commonly employed nucleic acid based diagnosis are DNA hybridisation and Polymerase chain reaction (PCR).

Nucleic acids are made up of nitrogen bases. The primary sequence of bases in DNA or RNA have regions which are unique for a particular organism or gene. The sequence of DNA is composed of a series of four phosphorylated bases Adenine (A), thymidine (T), guanidine (G) and cytosine (C). Pairs of bases (A=T, or G=C) can form hydrogen bonds, which cause opposing strands of DNA to form a semi-stable bonding (hybridization or annealing) to one another. If the opposing strands of DNA match exactly, then the familiar double helix form of DNA results. In the following example, the opposing strands in (1) will form a double stranded, tightly bonded structure, and the DNA strands are described as complementary. In (2) the strands are non-complementary (opposing A=T and G=C base pairs do not line up) and the two strands will not bond.

DNA Hybridisation

The basic principle in DNA hybridization is that, if a strand of double helix of DNA is separated from its complement (by heat) it will bind (reanneal or hybridize) only to its complementary strand (or to a duplicate of its complementary strand). Two complementary RNA structure will hybridise in the same manner. Inaccurate and mismatched bindings will be unstable and fall apart.

The binding of one DNA strand to another is in some respect is analogous to binding of antigen and antibody. However, in the case of nucleic acid bindings, the precise molecular nature of binding (base pairing) is known and can be easily manipulated by choosing DNA strand of appropriate length and by incubating the strands in appropriate salt concentration, temperature. The stringency (faithfulness of the match) of hybridisation can be precisely defined and as a result coincidental cross reaction is virtually eliminated.

Farming of fish and shellfish has gained significant grounds in several parts of the world. However, the major bottleneck to successful farming is disease in farmed aquatic animals. In recent years, lot of attention is being given to health management using various forms of immunoprophylactic measures such as vaccination and immunostimulation. To rationalise immunoprophylactic applications, it is vital to have insight into the specific and non-specific defense mechanisms of farmed aquatic animals. Through disease process studies it is very well known that a pathogen can cause disease only if it can overcome the non-specific and specific defence barriers of the host and successfully establish and proliferate. Non-specific and specific immune systems are the two main branches of the defense system. The immunity which an organism derives against a pathogen is the result of a delicate interaction and cooperation between the two systems.

The immune systems present in the surface structures of fish have their potential importance in local immune responses. Important surface barriers are skin, gills and gastrointestinal tract.

Pulses are the most important part of our diet, richest and cheap source of proteins, vitamins, minerals and amino acids besides high nutritional value. Hence, the economic value of these crops is very high. Pulses can be produced with a minimum use of resources and are mostly cultivated under rainfed conditions and do not require intensive irrigation (Sood et al. 2018). Keeping in view large benefits of pulses for human health; the United Nations has proclaimed 2016 as the International Year of Pulses. Thus, due attention is required to enhance the production of pulses not only to meet the dietary requirement of proteins but also to raise the awareness about pulses for achieving nutritional, food security and environmental sustainability. The Government of India through Indian Council of Agricultural Research (ICAR) has established a wide network of Krishi Vigyan Kendras (KVKs) in all the rural districts of the country. These KVKs under the aegis of the National Agricultural Research and Education System are the real carriers of frontline technologies and impart knowledge and critical input support for the famers. The frontline demonstration programme (FLDs) in pulses is a unique programme by Ministry of Agriculture, Govt. of India, conducted under close supervision of farm scientists. Main objective of FLDs in pulses is to demonstrate and popularize the improved agro-technology on farmers fields under varied farming situations for effective transfer of generated technology and f ill the gap between improved technology and adopted/indigenous technology to enhance pulse productivity and farms gains for sustaining the production systems especially under rainfed farming (Choudhary et al. 2009). The field demonstrations conducted under the close supervision of scientists of the National Agriculture Research System is called front-line demonstrations. The main objective of Frontline Demonstrations is to demonstrate newly released crop production and protection technologies and its management practices in the farmers’ field under different agro-climatic regions and farming situations.

Antimicrobial Resistance abbreviated as AMR is defined as the process by which microorganisms like bacteria, fungi, viruses, and parasites change over a period and become resistant to a drug to which they were earlier susceptible to. This makes the medicines ineffective for treatment overtime, thus making infections difficult to treat thereby increasing the risk of spread of diseases caused by them and severe illness which may lead to death. This in turn necessitates the need for development of newer antibiotics. However, there has been a sharp decline in the development and manufacture of new antibiotics in the recent years resulting in development of only few antibiotics in the past two decades. The increase in emergence of antibiotic resistance concurrent with decline in development of newer antibiotics poses a serious threat to health of both humans and animals. Every year about 700,000 deaths have been reported to occur due to resistant infections and this rate is likely to increase further with estimated infections due to resistant pathogens expected to reach over 50 million globally by 2050 (O’Neill, 2016). The worrisome trends of increasing antimicrobial resistance across the globe poses a serious threat to both animal and human health as AMR not only increases the morbidity and mortality rates but also increases the economic burden on health care (Zhu et al., 2022). This presents an extremely grave situation as the supply of new antibiotics is inadequate to cope with the increase of AMR pathogens. The unnecessary use of antibiotics globally especially in the livestock sector as growth promoter further helps in selective enrichment of AMR pathogens which further increases health risks. It is well known that resistant pathogenic and commensal bacteria can persist and spread within and between premises despite zero antimicrobial drug use. This may be explained due to maintenance, replication, and further dissemination of resistance genes by horizontal transfer of genes via natural ecosystem and can occur either by conjugation, transformation and transduction; and these mechanisms can rapidly spread AMR genes among microbial community in natural environment and human microbiome, where these resistant bacterial species may be selected due to presence of antimicrobial drugs (Zhu et al., 2022). The physical transfer of bacteria via movement of animals, workers, and equipment and ineffective cleaning and disinfection may also be responsible for increasing the AMR pathogens in the natural environments.

Resistance to antibiotics in the bacterial world is a genetically determined phenomenon that was first observed within a few years after the introduction of antibiotics for therapeutic purposes. In Nature, ARGs are believed to have originated about three billion years ago as an intrinsic defense mechanism in antibiotic-producing bacteria (Perry et al., 2016; Iskandar et al., 2022), and subsequently, evolved by complex and quantum jump trajectories to mobilize, diversify and interconnect all ecosystems in the micro-biosphere. Bacterial genomes exhibit plasticity and continue to evolve under the selection pressure of antibiotics and other stressors (Patel, 2016). The ARGs in circulation at present are thus a mixture of ancient and modern counterparts. Recently, the interplay between bacterial metabolism and antibiotic resistance has also been revealed (Zampieri, 2021).

The use of antimicrobials in health management, livestock, and food industry is driving the emergence of resistant microbes at a rapid pace (Wall et al., 2016; Adegoke et al., 2016; Hu et al., 2017). As a result, AR pathogens have spread globally to cause loss of lives, production, productivity, and negatively impact economic growth. Recently, AR pathogens in a large study have been found directly responsible for millions of deaths, and the figures are likely to increase in the coming decades (Murray et al., 2022). The pace of the emergence of AR can however be slowed down by improving human interventions. The global and local AR combat plans implemented during the past few years have enhanced the mass awareness of the pandemic problem (WHO, 2015; FAO, 2016; NAP, GOI, 2017; WHO, 2022; WOAH, 2022). These Action Plans on AR containment encourage avoiding of indiscriminate use of antibiotics for the treatment of sick humans and animals, recommend the ban on the use of antibiotics as growth promoters in food animals, promote AR surveillance and monitoring, and support the ‘One-Health’ strategy and application of the biosecurity principles for containment of the resistant microbes.

Understanding the variation in grain protein content is the pre-requisite of its improvement in modern rice varieties. The measure of quantitative and qualitative aspects of grain storage protein content includes estimation of soluble and total grain protein, quantifying various fractions, viz. glutelins, prolamins, globulins and albumins and their profiling through SDS-Page and  estimation of amino acid. As traditional chemical methods for protein content determination are destructive in nature. All these estimates comprehensively give insight into the diversity of storage protein in rice germplasm. The standard procedures followed for all these estimates are briefly stated in the  following sections.

Estimation of Total Grain Protein Content in Rice

The total protein is estimated via estimation of total N through the Kjeldahl method whereas soluble protein is estimated through Lowry method, Dumas method and Bradford method. But for estimation of large number of genotypes all these processes are tedious, time-consuming, and costly. Near-infrared spectroscopy (NIRS), as a non-destructive detection technique, can achieve rapid quantitative determination of protein contents and become an important development direction to replace traditional chemical detection methods.

The foundation of agricultural productivity lies in the realm of weather and climate, a reality unaltered by technological progress. The consequences of climate change on agriculture represent a worldwide apprehension, particularly significant for India. Around 54.6% of the Indian population is engaged in agriculture and allied activities, contributing to 17.4% of the country’s total gross value added. The agriculture sector is battling a multitude of challenges, such as increasing food demand, depletion of agricultural lands and water resources, and the devastating effects of climate change. It is high time that we acknowledge and address these issues to safeguard the future of our food systems and ensure food security for all.

Climate change refers to the long-term variations in weather patterns and temperature over extended periods. Climate change occurs when earth’s climate system experiences variations in weather patterns that can last for decades or millions of years. These changes can arise naturally due to phenomena like volcanic eruptions or changes in solar activity. However, since the 1800s, human activities accelerate the natural pace of climate change, primarily due to the combustion of fossil fuels like coal, oil, and gas. These activities release greenhouse gases like carbon dioxide (CO2 ), methane (CH4 ), and nitrous oxide (N2 O) into the atmosphere, trapping heat and leading to a gradual increase in global temperatures. One of the most remarkable characteristics of climate change is the increase in temperature, which is widely referred to as global warming (Houghton, 2009). According to the report of Intergovernmental Panel for Climate Change, the release of greenhouse gases caused by human actions has contributed to around 1.1°C of warming since the period between1850-1900. The report also predicts that the global temperature will likely increase to 1.5°C or more in the next 20 years (IPCC, 2021).

Climate change has significant adverse implications on the physiological processes and metabolic machinery of plants, potentially affecting growth, development, and overall crop productivity. The rapid increase in global population exacerbates the threat to global food security, which is further impacted by changing climate conditions. The Intergovernmental Panel on Climate Change (IPCC) estimates that between 1850 and 1900 and 2011 and 2020, the global mean land surface air temperature increased by 1.6 °C. Predictions by the United Nations indicate that the global human population could reach 8.5 billion by 2023 and 9.7 billion by 2050, up from the current 8 billion. The National Centers for Environmental Information (NCEI) reported that 2022 was 0.86°C warmer than the average of the 20th century, making it the 6th warmest year on record. These data suggest an increased probability of unpredictable climate changes and harsh growing conditions, manifesting as various abiotic stresses on major cultivable lands. Climate change impacts CO2 concentration, temperature, precipitation, pollutants, and nutrient availability and uptake, leading to drought, salinity, irregular rainfall, f looding, high temperatures, and nutrient deficiencies in staple food crops, thereby threatening global food security. This review focuses on the effect of elevated CO2 and temperature on fundamental plant metabolic processes such as photosynthesis, respiration, transpiration, and nitrogen metabolism.

4.1 Introduction

Water pollution is the contamination of water by an excess amount of a substance that can cause harm to human beings and/or the ecosystem. The level of water pollution depends on the abundance of the pollutant, the ecological impact of the pollutant, and the use of the water. Pollutants are derived from biological, chemical, or physical processes. Although natural processes such as volcanic eruptions or evaporation sometimes can cause water pollution, most pollution is derived from human, land-based activities (Figure 4.2). Water pollutants can move through different water reservoirs, as the water carrying them progresses through stages of the water cycle (Figure 4.1). Water residence time (the average time that a water molecule spends in a water reservoir) is very important to pollution problems because it affects pollution potential. Water in rivers has a relatively short residence time, so pollution usually is there only briefly. Of course, pollution in rivers may simply move to another reservoir, such as the ocean, where it can cause further problems. Groundwater is typically characterized by slow flow and longer residence time, which can make groundwater pollution particularly problematic. Finally, pollution residence time can be much greater than the water residence time because a pollutant may be taken up for a long time within the ecosystem or absorbed onto sediment.

Introduction and Scope of Biochemistry

Biochemistry is the field of study that focuses on studying chemical reactions occurring within living organisms. It is a specialized branch that combines the principles of both chemistry and biology. In order to comprehend the molecular mechanisms behind every biological event, this multidisciplinary f ield incorporates elements of biology, chemistry, and physiology. The scope of biochemistry extends from the study of small molecules and their interactions within cells to the analysis of complex metabolic pathways, enzyme kinetics, and the structure and function of biomolecules.

One of the main goals of biochemistry is to elucidate the chemical reactions that take place in living systems and understand how they regulate key biological processes. Biochemists investigate the structure, function, and properties of various biomolecules, such as proteins, carbohydrates, lipids, and nucleic acids. It helps us to study how these biomolecules interact and contribute to the overall functioning of cells, tissues, and organisms.

Biochemistry also plays a vital role in various areas of research and practical applications. For instance, in medical biochemistry, scientists study the molecular basis of diseases to develop diagnostic tests and therapeutic interventions. They investigate the biochemical mechanisms underlying genetic disorders, cancer, metabolic, and infectious diseases. Thus, understanding the biochemical basis of diseases can lead to the development of targeted and personalized treatments.
