Introduction

The acute food shortage was a major challenge in confronting the development of the country after independence with rapidly increasing population. Massive financial assistance of credit and subsidy under various rural development programmes unveiled by government could not yield desired impact on poverty and unemployment. The benefits of farm research did not reach the resource poor farmers. Several researchers indicated that the devolution of democratic decision-making at the village level was lacking.

The major task of bridging the gap between farmers and the scientific knowledge is in the hands of extension workers who should act as “conveyer belts” in communicating appropriate scientific knowledge and skills already available to the farmer in a smooth and acceptable form and in securing the adoption of these improved techniques. They must assess the intentions prevailing in the minds of rural people, their relationships and interactions, their groups, their institutions, their organizations and the culture, which influence the behaviour at large. They need to understand their motives, reactions, receptivity to new ideas, hidden resources of rural people and social and cultural obstacles prevailing in the society with their active participation.

To elucidate the hidden facts from the well-knit social, cultural and behavioral patterns, a family of approach known as “Participatory Rural Appraisal (PRA)” techniques is widely employed to understand the existing farming situations, problems, and opportunities in the rural areas. PRA techniques can also be used in evaluation and impact assessment in agricultural and allied enterprises and projects that can indicate the success and failure to plan for better future.

Practical application is essential for developing competence in programme evaluation and agricultural extension programme management. This chapter translates the concepts, theories and evaluation frameworks presented in the preceding chapters into structured learning activities. The practical exercises are designed to develop students’ ability to analyse programmes, identify appropriate evaluation approaches, develop indicators, collect and interpret evidence, and communicate evaluation findings. Activities include literature searches on Utilization-Focused Evaluation, Values-Engaged Evaluation, Empowerment Evaluation and Theory-Driven Evaluation; field visits to extension organizations; preparation of evaluation proposals; review and meta-evaluation of programme evaluation reports; SWOT analysis; programme activity identification; Gantt chart preparation; application of Bennett’s Hierarchy; Logical Framework Analysis using a 4 × 4 matrix; and assessment of agricultural technology impacts through KVK/ATIC visits. The chapter also provides practical exercises on Environmental Impact Assessment, Social Impact Assessment, Participatory Monitoring and Evaluation, and comprehensive evaluation report writing and presentation. These activities are intended to strengthen analytical thinking, practical skills, evidence-based decision-making and professional competence in agricultural extension evaluation

Practical applications and field techniques in spices breeding are essential for developing new varieties that meet the needs of farmers, processors, and consumers. These techniques involve a combination of traditional methods and modern technologies to select, test, and propagate spice plants with desirable traits. Here’s an overview of the key practical applications and field techniques used in spices breeding:
1. Selection and hybridization
• Mass selection: This traditional technique involves selecting the bestperforming plants from a large population based on desirable traits such as yield, flavor, and disease resistance. The selected plants are then propagated
to create the next generation.
• Hybridization: Cross-breeding different varieties or species of spices to combine desirable traits from both parents. This technique is used to create hybrids with improved characteristics, such as higher yield, better flavor, or
enhanced resistance to pests and diseases.
• Example: Cross-pollinating different varieties of chili peppers to produce hybrids with higher capsaicin content for spicier flavors.

This chapter translates ergonomic principles into practical strategies for improving work and everyday activities. Applications are organized around physical, cognitive and organizational ergonomics, showing how each domain contributes to human performance and system effectiveness. Examples from manufacturing, offices, healthcare, agriculture and domestic settings illustrate the adaptation of workstations, tools, work schedules and environmental conditions. Anthropometric data, task observation and work-study methods are used to identify mismatches between users and systems. The chapter emphasizes participatory assessment and appropriate interventions for reducing physical strain, mental workload and occupational risk. It demonstrates that practical ergonomics can simultaneously improve worker safety, comfort, productivity, product quality and organizational efficiency.

BASIC PRINCIPLE FOR TREATMENT OF POISONING

Introduction

All the toxicants or poisons including various toxins causing various toxicoses or poisonings in animals comprise two major classes. Firstly, poisons having specific an tidotes and secondly, those having no specific antidotal therapy and require symptomatic and supportive therapy for the treatment of their poisonings. The adage "Treat the patient, not the poison" is the most basic principle of clini cal toxicology. Thus, in cases of both type of toxic conditions, an immediate attention is required for the maintenance of vital functions particularly cardiopulmonary function by providing supportive or therapeutic measures before institution of antidotal or symptomatic therapy. Vi tal signs and important reflexes should regularly be monitored to judge the response to therapy and progress of recovery. As per need of the situation, a flexile step wise practical approach may be opted by veterinarians for the diagnosis and treatment poisonings in animals.

Fish production of the country has improved considerably in the post-independent India with the total production going up from 7.52 lakh tons in 1950-51 to 90.4 lakh tons in 2010-11, with an average growth rate of 4.35% per year after 1990. The real jump has come from inland aquaculture sector. Production from inland waters which used to be less than 30% of the total till sixtees, gradually rose at a fast pace and crossed the 50% mark by the end of 20th century. The present contribution of inland sector to the country’s total fish production of 52.09 lakh tons is 58% recording an average annual growth rate of 8.4% per year after 2011.

This increase in contribution from inland sector is because of the quantum jump in production from freshwater aquaculture, made possible mainly due to development of technologies of hypophysation of Indian Major carps and composite fish culture during late fiftees and sixties respectively. Development of these two technologies, along with their wide extension through Fish Farmer’s Development Agency, initiated by Govt. of India in latter part of 1970s, have in fact revolutionised freshwater aquaculture scenario of the country. It is presently contributing to over 70% of the total fish production  from inland resources of this country.

Theoritical aspects of design has been discussed in chapter 1. Discharging capacity of canal is

 computed by Manning Equation (1)and continuity Equation (2) (Para 1.4).

 In the Manning's equation  V  =   R2/3  S1/2 / N (Eq. 1, Para 1.4);  N and R play most important role.

2.0 Manning's Rugosity Coefficient (n)

Value of N depends upon a number of factors such as , surface roughness, vegetation, obstructions, type of lining, age of lining, erosion and damages in lining, curves, discharging capacity , perimeters, depth of flow, velocity etc. These are discussed below and commonly adopted values of n are given in tables 2.1 to 2.3.

Procedure: Collect the rainfall data from the Department of Agrometeorology and interprete it zonewise and district wise for various districts of Haryana. Correlate it with last year’s rainfall.

The Köppen climate classification is one of the most widely used climate classification systems. This chapter introduces practical laboratory exercises for objective evaluation of wool. It provides procedures for measuring fibre diameter and variation, crimp, staple length, moisture regain, clean wool yield and medullation, along with basic grading exercises. To determine the sucrose content in condensed or evaporated milk using the Lane-Eynon method.
Principle
The Lane-Eynon method is used to measure sucrose in condensed milk by utilizing the reducing properties of sugars. Sucrose, being a non-reducing sugar, is first hydrolyzed into glucose and fructose (reducing sugars). These reducing sugars then react with Fehling’s solution, producing a brick-red precipitate of cuprous oxide (Cu2O) when heated. This allows for the accurate determination of sucrose content after the hydrolysis (inversion) process.

• Cu(OH)2 + Reducing Sugar (RCHO) → Cu2O (brick-red precipitate) + RCOOH
This reaction forms cuprous oxide (Cu2O), a brick-red precipitate. The intensity of this precipitate correlates with the concentration of reducing sugar in the sample, providing a way to determine sucrose content.

The practical schedule to be implemented as per the syllabus prescribed for the course is reorganized in a logical sequence. The teachers offering the course is required to collect all the material required for effective practical training before the semester starts. In case of measurements made and observations taken, the students should be rigorous trained to understand significance of observation made and its practical utility (Fig. 15.1). Women account for 43% of the agricultural labor force in developing countries (FAO, 2011) and produce 50% of the global food production (FAO, 2011). Regional statistics reveal that in Latin America about, 20 percent, in Asia, about 30 to 60 percent, and in Sub-Saharan Africa, 50 to 75 percent of the agricultural labour force is supplied by women (FAO, 2013). Moreover, they invest 10 times more than their male counterpart in the family well being especially education and nutrition of children (Maertens and Verhofstadt, 2013). Despite being the primary contributors for the world food production, their roles are highly underestimated. Considerable gender bias exists in the agricultural sector, both in terms of quantities of assets, agricultural inputs and resources that women
control (Deere et al., 2013). Failure to recognize the roles, differences and inequities [between men and women] poses a serious threat to the effectiveness of the agricultural development agenda

This section will underscore the importance of direct interaction with weather monitoring equipment. Trainees will gain practical proficiency in:
• Operating and Maintaining Weather Stations: Learning the intricacies of setting up, calibrating, and maintaining various meteorological instruments like thermometers, hygrometers, anemometers, rain gauges, pyranometers, and soil moisture sensors. This will include understanding the principles of operation, potential sources of error, and best practices for ensuring data accuracy.
• Conducting Field Measurements: Moving beyond automated stations, trainees will learn manual data collection techniques for parameters like leaf area index, canopy temperature, radiation interception, and soil physical properties. This hands-on experience will foster a deeper appreciation for the spatial variability of microclimates and the challenges of obtaining representative data.

Tamil Nadu has unique physiography with western and eastern Ghats on the west and northwest, Bay of Bengal in the east and Indian Ocean to the south. Tamil Nadu has high dependence on natural resources and hence faces the threat of climate change and its impacts. Available evidence shows that there is high probability of increase in the frequency and intensity of climate related natural hazards (Stephen, 2012). Out of 13 million hectares of geographical area, about 7 million hectares of land is under cultivation. Of this 55 per cent is irrigated and rest is under rain fed / dry lands. In Tamil Nadu, ground water has been harnessed fully and dry land productivity is found oscillating with ruling variability in seasonal monsoon rain and hence agricultural productivity is always under stake. To improve agricultural productivity, Tamil Nadu has been divided into seven agro climatic zones viz., North Eastern zone, North Western zone, Western Zone, Cauvery Delta zone, the Southern zone, High rainfall zone and High Altitude and Hilly zone. Tamil Nadu is vulnerable to increase in temperature and sea level rise with change in climate as a result of accumulation of green gas gases beyond the threshold level in the atmosphere at the global level (TNSAPCC, 2014). United Nations Organization (UNO) defines vulnerability as the extent to which a natural or social system is susceptible to sustaining damage from climate change process and vulnerability is a function of the sensitivity of the system to change in climate, adaptive capacity of the said system (natural or social) and the degree of exposure of the system to climate hazards (UNFCCC, 2008). Climate change is one of the biggest challenge to food security, but it is also an opportunity for the scientists and farmers to innovate and adapt. More than 70 per cent of the population in Tamil Nadu are engaged in agriculture and are facing the threat of climate change. The food grain productivity need to be increased by 130 per cent by 2050 to meet the demand of growing population. The Government of Tamil Nadu is moving towards the goal of doubling the food production and tripling the income of the farming community in a sustainable way through effective management of natural resources including soil and water. This could be achieved by practicing climate smart agriculture that aims to help find new ways to adapt to changing climate. This process would increase agricultural productivity and farm income sustainably and equitably and simultaneously helping food system pillars and farmer’s livelihoods and at the same time minimizing agriculture’s green house gas emissions. Each and every farm can become climate smart unit for promoting sustainable weather based farming practices, using inputs more efficiently and effectively to grow more and building market where farmers can access what they need and sell any surplus of what they produce.

Present study was embarked upon to extricate the underlying calcium signaling mechanisms responsible for spasmogens (PGF2α , and oxytocin) induced muscular contractions in oviducts of non-pregnant buffalo in oestrous stage. Isometric tension in longitudinal oviductal in both ampulla and isthmus strips was recorded under the resting tension of 1 ± 0.2 g following mounting the tissue in Ringer–locke solution. Following an equilibration period of about 120 to 150 min, oviductal strips both ampulla and isthmus presented a consistent and rhythmic pattern of spontaneity. Mean Integral Tension (MIT) and amplitude (g) of ampulla and isthmus in normal spontaneous tissue did not differ significantly. The frequency (BPM) of ampulla and isthmus in normal spontaneous tissue differed significantly (P<0.05). PG2α produced significantly (P<0.05) greater contraction than oxytocin in both ampulla and isthmus of buffalo oviduct in concentration-dependent manner. In isthmus the contraction produced by oxytocin was negligible. PGF2α produced a significant change in tonic contraction between ampulla and isthmus but the change in phasic contraction between ampulla and isthmus was not significant. PGF2α produced significantly (P<0.05) greater contraction in ampulla than in the isthmus of buffalo oviduct.

Wide hybridization (interspecific/intergeneric) is basically attemped to introduce new genetic variability from wild or distantly related species into cultivated ones or to synthesize new plant type/s like Triticale and Raphanobrassica. Majority of the commercial crop plants are usually deficient for one or the other desirable traits which are usually available in their wild relatives. However, crossability between commercial varieties and their wild relatives is very limited which is naturally imposed by certain genetically controlled reproductive barriers. These reproductive barrier/s usually operate either at pre or post fertilization stage/s in plant species (Stebbins1958). Since a species is constituted of individuals who share a common gene pool, reproduce among themselves only / exchange genes and share a common habitat. Hence at natural level gene flow remains strictly confined only among members of a particular species otherwise among the members of unrelated species a genetic barrier exists to create reproductive isolation. Therefore, wide crossing basically requires the overcoming of such barriers whch are imposed by temporal and spatial isolation of parents. The reproductive isolation consists of premating and post mating isolation mechanisms like habitat isolation or geographical isolation, sexual isolation and mechanical barrier depending upon incompatibility or mismatching of ganitalia (animals). Sexual isolation in animal kingdom is usually enforced by type of sexual displays and mating calls which are attractivce only to particular members of a species , however other potential intermating species also do exist in the same habitat or locality at that particular period of time.

Flower is symbol of beauty and by nature attracts every human being. It is a gift of nature to humanity. Flowers symbolize the quintessence of human spirit. In India, losses are estimated to be more than 30-35%. It is due to the lack of knowledge of postharvest management of cut flowers. Several factors at pre harvest stage including genetic or inherent, climatic or environmental and management harvest factors like stage, method, time of harvesting and postharvest factors such as watering, rehydration, precooling, storage environment, packaging techniques and microorganisms influence the postharvest quality and longevity of cut flowers.

Preharvest factors

1. Genetic or inherent makeup: Postharvest lasting quality of flower species and cultivars vary considerably due to differences in their genetic make up. It is therefore desirable to grow cultivars, which possess long vaselife.

• Removal of field heat after harvest at 32°C for 1 h.

A well planned projects requires pre-feasibility study to explore the opportunity to find out problems, avenues of co-ordination etc. A government being a regulation spells out priotize for national and regional economy and by the frameworks for resource allocation.

Food is a resource of vital importance and its safety in the whole chain, from producer to consumer, is a worldwide concern. In fact, as food trade expands throughout the world, food safety has become a shared concern among all consumers. This issue began to be taken seriously at a period where there is a significant increase of illness caused by infected food in both developed and developing countries. Unsafe food contains hazardous agents or contaminants that can make people sick, immediately or by increasing their risk of chronic disease. Contaminants can enter food at many different points in the food production process, and can occur naturally or as the result of poor or inadequate production practices. International competitiveness depends more on quality and safety concerns than on prices. Governments and local authorities intervene in the market place in setting technical regulations; and sanitary and phytosanitary measures. This encouraged food processing companies around the world to implement food safety management systems which guarantees the production and distribution of safe foods. Prerequisite Programs (PRPs) are considered as the integral part of food safety standards and audit schemes all over the world. It is essential to implement food safety programmes in every company to check the chances of illness or injury due to unsafe food.

1. INTRODUCTION

Since vedic times, importance of fermented milk and its products was known but the major attention to probiotic and its health related benefits was gained after Eli Metchnikoff’s publication entitled “The prolongation of life” in 1908. Due to the awareness of the role of nutrition in health and well-being, improved knowledge of diet-related diseases, consumer demand for probiotic and prebiotic products has been increased in recent years. The link between diet and health is flourishing the market for health-embracing population and opens an opportunity for Food and Dairy Industries meet the demand of this market. Probiotics, constituting live micro organisms, have been incorporated into drinks, food products, supplements (tablets, capsules and freeze–dried preparations) and prebiotic products. Milk, milk based products, fruits and vegetables are rich in functional food components such as minerals, vitamins, dietary fibers, and antioxidants (phytochemicals). Application of probiotic bacteria in such products further enhances the nutritional value of the food product. Probiotic juices produced from fruits and vegetables have also been in consideration in recent years. The food market is being getting captured by pro- and prebiotic food products day-by-day. Even the agro-industrial by-products such as whey, wheat straw, rice straw, sugarcane bagasse, etc. are being explored for the economical and cost effective production of prebiotic molecules. Abstract

The concern of consumers for convenience and healthy foods involves many parameters like functional and nutraceutical properties, ease to prepare, good quality, economics as well as good nutritional profile of the food. This trend of convenience has been increasing in today's world because of the societal changes like the aging of population, the increasing entry of women into the labor force, the change to a multi-cultured society and the increasing polarization between poor and rich. Value addition to the traditional sources is a medium to bring variety products into the market. Cereal starches possess a wide application in the food industry as an additive but the native starch is not widely used in food industry due to its poor functional properties. Pregelatinized starches and flours have become important in processed foods because the functional properties of the starches and flours are improved over the native starches and cereal flours. Modification is a process which alters the structure of the starch in the wheat endosperm by affecting the hydrogen bonds in a controllable manner. Modification of starch and flours is generally done by several methods such as chemical degradation, physical alteration or enzymatic transformation. The primary objective of modification is to reduce the hot viscosity of the starch paste so that higher concentrations of starch can be dispersed without excessive thickening. The pregelatinized flours offer a tremendous number of functional benefits to variety of foods such as bakeries, snacks, beverages as well as nutritional foods. Introduction

Quality of fish is affected by various factors, which are classified into two categories: intrinsic factors and extrinsic factors. Intrinsic factors are the chemical and physical properties inherent to fish. Extrinsic factors are treatments given to fish before and after catch until it reaches the consumer, which includes the method of catch, cross contamination, processing, preservation, and product storage environment (temperature, humidity, packaging). The processing methods such as drying, smoking, chilling, and salting greatly help to minimize the spoilage. The quality of fish is also dependent on cold chain, in which the temperature is managed and monitored at every stage of production, transport, storage and sale.

2.1. Pre-Harvest Factors

Pre-harvest factors relates to the intrinsic factors affecting the quality of fish, as they are beyond the direct control of human. Various intrinsic factors affecting quality are fish species, size, sex, physiological state, parasites, naturally toxic fish, pollutants, and occasional peculiarities. Additionally, some of the extrinsic factors like method of catch and feeding interruption for starvation are also considered as pre-harvest factors affecting the quality of fish.

2.1.1. Species Characteristics

The quality of fish is related to species. For instance, flat fish keep better than round fish. Post-mortem pH varies between species. For example, long rigor period and low pH (5.4-5.6) of very large flatfish and halibut give relatively long iced storage life of 21 days, while mackerel with low post-mortem pH has no effect on shelf life. Some fish are rated as good quality as they are expensive, example, seer fish and pomfret. Fatty fish are rejected sensorial before lean fish due to the appearance of oxidative rancidity. So, lean fish keep longer than fatty fish under aerobic storage. Bony fish are edible longer than cartilaginous fish. Skin of fatty pelagic fish is very thin and contribute to faster

spoilage rate, as it allows enzymes and bacteria to penetrate more rapidly. Thick skin and slime of flatfish contribute for better keepability, as slime contains bacteriolytic enzymes, antibodies and other antibacterial substances.

By modulating hormonal signals, PGRs can alter enzymatic activities, influence fruit texture, and mitigate transportation losses. However, judicious application is paramount to avoid adverse effects on fruit quality and safety. Harvesting decisions, including the determination of optimal maturity and the timing and method of harvest, profoundly impact fruit quality and post-harvest losses.

The possible reasons for high mortality and morbidity are the inadequacy of health services and ignorance regarding the need of obtaining medical care by pregnant or lactating women. ICDS has an important role to fill in this gap of knowledge and non-availing attitude of women. Integrated Child Development Services (ICDS) is a prominent national program that provides package of services of children and women. Role of Anganwadi worker in ICDS scheme has to provide information to beneficiary mothers regarding reproductive health, balanced diet, pre and post maternal services , neo-natal care and family planning etc .Group discussions are often organized to impart education regarding health, breast feeding and immunization etc at AWCs. AWWs also provide information to beneficiary mothers regarding health camp, doctor’s visit and immunization day by visiting the beneficiaries at home as well as at AWCs. Present research has focused on pre-maternal services. An assessment in the present study of the frequency of availing pre maternal services and the coverage of beneficiaries can give important information regarding actual benefits to the vulnerable groups.

Pre-processing of fish

Fish is a highly perishable food which requires proper handling and preservation to increase its self life and retain its quality and nutritional aspects. Therefore, fish pre-processing and preservation are become a very important part of commercial fisheries. Preservation means keeping the fish after landing in a condition of wholesome and fit for human consumption for a particular period. This preservation should cover the entire period from the time of capture of fish to its sale at retailer’s counter. The main aim of processing and preservation of fish is to prevent fish from deterioration. Methods which are commonly used to preserve fish and fishery products include the control of temperature using ice, refrigeration or freezing and control of water activity by drying, salting, smoking or freeze-drying etc (FAO, 2011). Fish has to be pre-processed in such a manner that it remains fresh for a long time with a minimum loss of flavour, colour, taste, odour, nutritive value and digestibility. Fish processing can be subdivided into fish handling which is the preliminary processing of raw fish and the manufacture of fish products.

5.1. Definitions and Terminologies

5.1.1. Quality

We say a product is of satisfactory quality, if it satisfies the consumers. According to C. D. Lewis, a British writer, quality is “an asset which is offered to the potential customer of that product or service”. The International Organization for Standardization (ISO) has put up a more comprehensive definition of quality as “the degree to which a set of inherent characteristics fulfils requirements” (ISO 9000: 2005 – 3.1.1). In general terms, ‘quality’ is defined as the composite of characteristics that differentiate individual units of a product to determine its acceptability by the customer. Quality characteristics are nothing but elements that makes a product fit for use. Quality characteristics are further classified into categories called as parameters.

5.1.2. Total Quality Management

Total Quality Management (TQM) is an organization’s management approach, centered on quality. It improves the effectiveness and flexibility of a company or an organization. TQM is defined as “the system of establishing defect prevention actions and attitudes with a company or an organization on a permanent basis for the purpose of assuring conforming products or services directed at customer satisfaction”. TQM is based on the participation of all its members in decision making, which is aimed for long-term success, through customer satisfaction and benefits to the members of the company or organization and to the society.

The aim of pre-slaughter care of animals is to arrange physiologically normal animals for slaughtering without loss of weight and to minimize stress to the animals. Pre-slaughter care of meat animals includes proper handling of animals during loading, unloading, transportation, lairage care and handling of animals just prior to slaughter. Thus due care must be adopted in this stage not only for welfare point of view but also for production of good quality meat. Proper care and handling is also essential to reduce the chances of bruises, cuts, tears and deformities on the animals/birds body.

Depending on the type of seed, different environmental factors promote different levels of germination. For example, some seeds need to be kept in a very damp, cold environment, while others need to be kept in a dry, hot environment. Different techniques are employed to support seed survival and speed up germination, depending on the size of the lot, the species, the local conditions, and the availability of pertinent tools and facilities. Many species’ seeds don’t germinate successfully unless they are exposed to specific circumstances. Dormancy is the state in which seeds do not germinate unless certain circumstances are met. Conditions in the natural world could include being near fire or being eaten by animals.

When some seedborne diseases or pests like insects are taken into consideration, seed quality can still be negatively impacted.
