10.1. Introduction

The soils possessing characteristics that are not suitable and economical for crop growth are termed as Problem soils. These characteristics may be of physical, chemical and biological. For cultivation of crops in these soils, it is necessary to follow specific management interventions and proper reclamation measures. Frequently we come across another term, ’degraded soil’. Degraded soil is also a problem soil. However, there exists a hair-line difference between problem and degraded soil. Problem soils refer to the soils in which the inherent soil characteristics, obtained from its genesis, pose problems for their optimal use, while degraded soils are developed due to anthropogenic activities by unwise management interventions.

10.2. Types of problem

Mainly there are four types of problem that may exist in soils: physical problems, chemical problems, biological problems and nutritional problems as a result of physical, chemical and biological constraints in soils.

Introduction

Farming community is facing multiple problems to maximize crop productivity as well as to increase farm income. In spite of successful research on new agricultural practices concerning crop cultivation, majority of the farmers are not getting upper-bound yield and not earning profit due to several constraints. One of them is that expert advice regarding crop cultivation is not reaching the farming community in a timely manner. It is true that India possesses valuable agricultural knowledge and expertise. However, a wide information gap exists between research and actual adoption in the field. Farmers need timely expert advice to make farming more productive and competitive. Local information resource centers are gaining importance with computers carrying expert systems to help farmers in making decisions. It is known that many Agricultural Research Institutes are involved in the development of agricultural expert system to satisfy the information needs of farmers.

A problem can be defined as a situation that prevents us from achieving the goals we have set for ourselves. It can be anything from financial, personal to work-related. Problems can arise anywhere, and any activity that helps to end our problem results in problem-solving. Being a part of an extension organization we have to come across different kinds of problems. Every job role has its problems. But how well do we cope up with the everyday problems that we often face? Some people are good at problem-solving. Others may think they are not. Most are somewhere in between.

Good problem solving skills empower managers in their professional and personal lives. Good problem solving skills seldom come naturally; they are consciously learnt and nurtured. The selection of good problem solving skills includes:

This module equips participants with practical tools to tackle problems confidently.

ACID SOILS: Acid soils with pH below 6.5 are widespread. Main limitations of these acid soils are low pH, low CEC, low status of bases, especially Ca, Mg, and K along with toxicity of Al and Mn. Use of acidifying fertilizers aggravates this situation.

Introduction

Problem soils are those that impede agricultural productivity owing to mineral stress, dryness, acidity, sodicity, waterlogging, etc. Vertisol, acid sulphate soils, saline-sodic soils, peat soil, and fine textured alluvial soils were the categories Beek et al., (1980) used to group the problematic soils. In addition to vast areas where deficiencies of zinc, phosphate, and iron, or excesses of iron, aluminium, and manganese limit rice yields, Ikehashi and Ponnamperuma (1978) observed that approximately 100 million hectares of land that are physiographical and climatically suitable for rice lie idle due to the soil toxicities caused by salt, alkali, acid, or organic matter. Problem soils can be broadly defined as those that have unfavourable conditions whether natural or artificially created that severely restrict the successful development of crops. Soil profiles with high groundwater levels and a less permeable argillic layer, degraded soils, sandy soils with low fertility, coastal soils that frequently flood, and laterites could all be categorised as problem soils. Without taking into account related soil functions, soil health is evaluated independently. It is also based on the f indings from a few soil tests for different criteria. 2015 has been recognized the International Year of Soils by the 68th UN General Assembly in recognition of the importance of soil health in all dimensions.

Introduction

Before start of this chapter some pertinent questions need to be answered. What are different agro ecology and what are the problem soils. Since dawn of agriculture in early 2000 B.C. man has been doing agriculture as subsistence farming to cater the needs for his own consumption. Later on as the population increased, the availability of land per pearson reduced and further the commercialization of agriculture after world war II, particularly in industrialized nation, compelled farmers to increase productivity per unit area. The green revolution involving higher fertilizer uses, more use of agrochemicals together with evolvement of improved crop varieties in later part of twentieth century played vital role in producing higher grain production resulting the global production triplet in contrast to merely increase in total global cultivated area to the extent of 10%.

The catastrophe of green revolution was realized in later years when reports of soil health degradation started appearing. Intensified agriculture characterized by excessive use of fertilizers, agrochemicals and unsupportable level of over exploitation of natural resources led to serious degradation of ecosystem. Thus management of agroecosystem has reached to a crossroad with serious pressure to increase productivity simultaneously holding the soil health with prime concern for future generation. Thus the soil heath under different agroecosystem are posing problem as the soil productivity has not reached to plateau level but has started reducing year after year. Thus such soils are becoming problem which need special attention to bring them back to support higher crop production.

The problem soils are those which, due to its land or soil characteristics, cannot be economically used for the cultivation of crops without adopting proper reclamation measures. 
Classification of  Problem Soils:  The problem soils are divided into 3 groups. 
    ·    Highly Eroded Soils 
    ·    Saline and Alkali Soils 
    ·    Acid Soils 
Highly Eroded Soils
These soils are called ‘Usar’ in U.P., ‘Kallar or Thur’ in Punjab and ‘Luni’ in Rajasthan. In India, area under saline alkali soils is 7.0 mha. When the chloride (Cl), sulphate (SO₄^2-), carbonate (CO^₃2-) and bicarbonate(HCO₃-) salts of sodium (Na⁺), calcium (Ca²⁺) and magnesium (Mg²⁺) are increased in the soil, the soil become saline and alkaline. On the basis of amount of soluble salts, average quantity of exchangeable Na and pH, they are classified into 3 groups

The soils which owe characteristics that they cannot be economically used for the cultivation of crops without adopting proper reclamation measures are known as problematic soils. Different kinds of problematic soils viz., Physical, chemical and biological problematic soils exists and pose problems of crop production.

The popularity of greenhouse-grown produce continues to rise as it provides a variety of produce during the “off” season. Greenhouses are good for healthy plant nursery production and other a number of crops for profit. Though the greenhouse farming in India like in other countries is progressing but there are certain problems and constraints as stated below.

1.Greenhouse production generally is highly technical and requires constant and continuous attention during cropping period. Relevant information about the crop environmental requirement such as right temperature, humidity etc is essential.

2.Knowledge about the right type of inputs for greenhouse production is a must which is not easily available.

3.Greenhouses cultivation increases the land, water and fertilizer productivity along with reduction in pesticide use. But such interventions are associated with very high initial cost. Although, it is linked with several Government Schemes in India and have 50-90% of subsidies depending on intervention, status / socio-economic condition and policy of State and Central Government.

4.Uninterrupted and regular power supply is required for operating cooling and heating system of the controlled environment greenhouses which necessitate a back-up power pack which is also expensive and underutilized.

Soil erosion refers to detachment and transport of soil and soil particles from one place to other by the action of water, wind or gravity. Soil erosion consists of (i) detachment of soil particles from surface (ii) their transport from one place to other and (iii) deposition in another place.

Soil erosion are of two types: Natural erosion and accelerated erosion. The natural or geological erosion is steady, nondestructive and slow process of nature. On the contrary the accelerated erosion caused due to human activities like cutting of forest, intensive cropping, construction of roads and building is very rapid and destructive. Surface one inch of soil which is formed in thousand years can be lost within one year due to accelerated erosion.

In India, out of total 175 million hectares of degraded land, soil erosion due to water and wind accounts for 150 million hectare. Soil erosion due to shifting cultivation, salinity, alkalinity, water logging and shifting of water courses account for 25 million hectare.

Average soil loss from various land surfaces in India has been estimated to be 5334 million tonnes per year out of which 29 percent is permanently lost to sea, 10 percent is deposited in reservoirs and 61 percent is transported from one place to other. The plant nutrients lost through 5334 million tonnes of eroded soils was estimated to be 8.4 million tonnes which includes 2.5 million tonnes of N, 3.3 million tonnes of P and 2.6 million tonnes of K.

Siltation of reservoirs through water erosion is a major concern in India. This accelerated silting has considerably reduced the estimated life span of major reservoirs. The rate of siltation depends on the catchment area, soil erodability, topography and rainfall pattern. Larger the catchment area, smaller is the siltation load in the reservoirs because, the coarse fraction of eroded particles may be settle down in the stream valley before the water enters into the reservoir.

Saline and alkali soils occur commonly under arid climate due either to the presence of an excess of soluble sodium salts or to the predominance of sodium among the exchangeable bases.

Saline and alkali soils have been classified as follows

1. Saline soils

Saline soils were originally called “White alkali” soils. Russians term them as “Solonchak” soils.

The soils are classified as saline if the electrical conductivity of saturated soil paste is more than 4 dS /m at 25⁰C, exchangeable sodium is less than 15 percent and pH is less than 8.5.

2. Alkali soils

The soils have been classified as alkali if the electrical conductivity of saturated soil paste is less than 4 dS/m, exchangeable sodium is more than 15 percent and pH is 8.5 to 10.0.

Global demand for cut flowers is increasing steadily at around 10 per cent per annum. The share of India in this flourishing trade estimate at over US$ 40 billion per annum is negligible at 0.4 per cent. Floriculture include cut flowers, pot plants, cut foliage, seeds, bulbs, tubers, rooted cuttings and dried flowers or leaves. At international cut flower trade, flowers such as rose, carnation, Chrysanthemum, gerberas, gladiolus, gypsophilla, liatris, nerine, orchids, anthurium, tulips and lilies are preferred. Roses, gerberas and carnation are grown in greenhouses. The open field crops are Chrysanthemum, roses, gaillardia, lily, marigold, aster, tuberose etc. In India, floriculture is emerging as an important economic activity, earning foreign exchange. It has become a potential farm income enterprise. The domestic markets for high-quality flowers have been growing at 10- 20 per cent per year for the last few years. India’s flower business is estimated to be worth $ 400 million at retail, and about $ 100 million in international trade. Flower exports are about $ 30 million, constituting mainly of roses and dried flowers. Both Central and State Governments have been more than proactive and have made large investments in this industry in assisting production and marketing.

A large variety of floricultural crops can be produced in protected environment as economic cash crops for the benefit of farmers. Problems associated with floriculture in hills are small, scattered land holdings and sparsely located population. There is a lack of irrigation facilities due to scarce availability of water resources; widespread natural vagaries like drought, hail storms, frost etc. There is a serious gaps in application of advanced floricultural technologies for improving quality and productivity; high pressure on land use for different purposes like cereal crop production, fodder production, etc. due to low per capita land availability; difficulty in technology dissemination due to difficult terrain, hostile climate, poor communication facilities and sparsely located population. Consuming markets within the state are very less which result in dependence upon distant markets of the county. There is a high post-harvest losses due to lack of modern post-harvest management system; very high temperature differentials in production areas and consumer markets; perishable nature of flowers, resulting in high post-harvest losses during transportation; and distant location of production areas from main roads. High cost of marketing, lack of organised system of marketing, lack of bargaining power with individual growers due to small production levels; inadequate availability of market intelligence to farmers resulting in imbalances in distribution of produce in different markets.

Problems Associated with Rainfed Farming Agriculture

It is a dream desire to eliminate drought from this region. There are many problems that are associated with rainfed farming systems. The problems may be grouped into four major factors: climatic, edaphic, technological and socio- economic.

Climatic

1.Scarcity of rain-water which is low and unpredictable with respect to intensity and distribution;

2.High ET (nearly 3650 mm annually compared to total annual precipitation ranging from 350 to 1400 mm);

3.Extreme thermic values (upto 490C with the mean annual temperature exceeding 180C at some places);

4.High solar incidence (450 to 500 Cal cm² day^-1);

5.High wind velocity with desiccating winds causing a high rate of ET and wind erosion;

6.Low relative humidity;

7.Extensive climatic hazards such as weather aberrations, drought, flood, frost, gale, cyclones and burning winds due to dry, deserted and denuded situations.

Abstract

Development of vermicomposting technology in India was started in seventies, but except some areas of South India it has not been popularized among common masses. This technology is labour intensive and needs attention to handle the tiny earthworms in a proper manner. Sincerity and dedication bring success while casual attitude ends up in financial loss. Lack of proper knowledge on suitable technique, unawareness about nutrient and hygienic standards of vermicompost, non availability of suitable earthworms, lack of marketing and training facility are some major problems in non-flourishing this technology in rural areas. But this technology being simple and easy to follow, is gradually becoming a boon to the low educated poor unemployed youths of the society for their economic development through generating income and creating self employment. Vermicompost, vermi-T and earthworms are marketable product. Government agencies and Non Government Organizations are trying to popularize this technology which has bright prospect to maintain health and hygiene of human to environment.

Introduction

Poultry farming is the process of raising domesticated birds such as chickens, ducks, turkeys, quails, guinea fowls, and geese for the purpose of farming meat or egg for food. Indian poultry industry is one of the fasted growing segments of the agricultural sector today in India. Undoubtedly, this impressive growth is a result of several factors such as active development support from the state and central government, research institutes, international collaboration and private sector participation. Indian poultry industry is self sufficient, supported by a broad and strong genetic base in which the productivity levels of broilers and layers are equal to those achieved elsewhere (i.e. in the United States of America and the European Union). Raising of day old chicks up to the stage of sale with assistance in the form of services from hatcheries, medical care from veterinarians, supply of medicine from pharmaceutical companies, manufacturing quality medicine, supply of poultry equipments and supply of nutritive poultry feed by commercial poultry feed manufacturers and financial assistance from various financial institutions are included under poultry industry.

In the recent days, poultry farming has become an important industry in our country. The changes, it has undergone in the past few years are quite surprising. The scope of the poultry farming is very much and there is lot of chances for improvement in this field. With the help of sophisticated instruments, the production of poultry products can be increased. Creation of public aware is needed for overall development of poultry industry. The egg is needed for over all development of poultry industry. The egg earlier treated as non-vegetarian item, is not being considered by most as not so.

It is very beneficial for children as it helps to grow with physically and mentally. Cow milk help to reduce weight loss as it loaded with protein which is essential for weight loss. Calcium and vitamin D of milk increases the metabolic rate of the body. A better metabolic rate helps in burning calories faster. Drinking cow milk regularly helps you in maintaining the blood sugar levels in the body. Cow’s milk has essential minerals and vitamins that help in processing the food normally and this helps to maintain the insulin and glucose level.

Goat is being raised for centuries as poor man’s cow due to its importance of providing employment in rural areas by producing meat and healthy meat. Goats also play major role in agriculture economy of India. Goat is excellent source of additional income for poor and landless owners. Farm can start from 1 male goat and 1 female goat. The goat milk is nutritious and easily digestible milk to their kids. Goats are easy to maintain as they can graze on open land. Goat farming is an excellent option where fodder and forage is limited. Goat farmers can get good returns with successful goat rearing. Now a day, goat farming has become more commercial and many people are taking up as a challenge to meet the demand and supply. There is good encouragement from governments and providing subsidies on especially stall fed goat farming. Most of the farmers, choosing stall fed goat farming as it has its own advantages as compared to open grazing methods.

Introduction

Sheeps were first domesticated by human being, many thousands of years ago for their wool, meat and skins. It provides a source of income to the shepherds through sale of wool and animal. Sheep do not need expensive building to house them and require less labour than other kinds of livestock. The foundation stock is relatively cheap and the flock can be multiplied rapidly. Sheep are economical convertor of grass into meat and wool. Sheep will eat varied kinds of plants compared to other kind of livestock. This makes them excellent weed destroyer. Unlike goats sheep hardly damage any tree. The production of wool, meat and manure provides three different source of income to the shepherd. The structure of their lips helps them to clean grains lost at harvest time and thus convert waste feed into profitable products.

Introduction

The basic concept of digital libraries is the sharing of information and resources globally for providing right and nascent information to the right user at the right time. It is the computing terminals having linkage to different sources of information in electronic or digital form. Digital library is a collection of information that is both digitalized and born in digital form, which offer capabilities beyond those of the agricultural and traditional libraries. Digital library is not only digitization of physical resources, but also thoughtful organization of electronic collection for better access.

The purpose of technological advancement these days is to make our lives comfortable. But many of the new inventions have added more stress to our lives and have made our lives increasingly more complex and complicated. Even more needs and demands seem to be built into our daily lives. These demands have affected the mental health, wellness, and psychological well-being of people living in our society.

These days, many advances have been made in eradicating disease, poverty, and other problems that have plagued our society, with the strains of modern living. Insecurity, worry, unhappiness, etc., have increased and have made mental illness our number one health problem. Anxiety and tension have increased so much that one out of every ten persons in our society has started taking tranquilizing drugs in one form or another.

The cases of mental illnesses have also increased these days, as shown by the admission records of the mental hospitals. These conditions have given birth to many psychological problems that are related to mental health. In this chapter, we are going to study those problems.

It is agony of the situation that even after attaining food security after a wonderful revolution, we are at a verge of complex combination of several crisis. This notably includes lack of nutritional security, deteriorating genetic base, loss of biological-diversity etc. Therefore at the 66^th session of general assembly of the United Nation 2014 was formally declared to be the “International Year of Family Farming” to reposition family farming at the centre of discussion to address multiple problems existing in agriculture (www.fao.org/family-farming-214/home/what-is-famly-farming/en/).

Family is the basic unit of the society. A self reliant and prosperous society needs self sustaining families which in turn require equitable and creative participation by all members of the family. Family farming is the backbone of agriculture where a rural youth effuse and rejuvenate this backbone through effective participation and obeisance of the tradition through which indigenous technical knowledge is transferred.

In an orchard all the fruit trees do not bear equally or regularly and sometimes fail to flower and fruit under similar conditions where another fruit tree bears heavily. This failure to set fruits may be attributed to unfruitfulness. To understand the problem of unfruitfulness in orchards a familiarity with following terms is necessary.

1.    Fruit setting: It refers to initial growth of ovary and its associated parts after blossoming and taking it to maturity.

2.    Fruitfulness: It is the state of plant when it is not only capable of flowering and fruit setting but also takes these fruits to maturity and inability to do so is unfruitfulness or barrenness.

3.    Infertility: Ability of a plant not only to produce fruits but develop viable seeds and the inability to do so is referred as sterility or infertility. All fertile plants are fruitful but all fruitful plants are not fertile (Seedless fruits).

4.    Self fruitfulness: Ability of a plant to mature fruits after self pollination.

While developing the toolkit for Participatory Curriculum Development participatory approaches like Focus Group Discussions and Field Level Workshops were adopted. The goal is to provide demand-driven services and to do so, extension professionals need to respond for farmers’ requests rather than deliver predetermined packaged solutions. It is also time to enable the farmers to empower and make their voices heard. Equally important is to make the service providers accountable to the farmers, which is possible when the farmers pay for the services they receive.

Biological materials

Seeds from self fertilized plants will be obtained from the concerned breeder. Hand picked, uniform sized seeds will be chosen for mutagenic treatments.

Gamma irradiation

Gamma irradiation will be performed in gamma chamber, exposing the seeds to gamma rays from ⁶⁰Co source: well filled and hand picked uniform sized seeds with a moisture content of 8.5 per cent will be chosen for irradiation. A sample of say 120 seeds per treatment will be packed in butter paper cover and placed in 100 curie ⁶⁰Co gamma cell. The treatments will be given for various duration depending on the doses required with the dose rate of say 54.05 rads/sec.

Chemical mutagenesis

The seeds will be soaked in water for say 6 hours before the chemical treatment. The duration of pre-treatment with water will be determined on preliminary blank experiment. In cowpea genotype Co. Vu. 623, there was about 5-10 per cent radical emergence about 12 hours after soaking in water. There was no radicle emergence before 12 hours water soaking. An initial pre-soaking period of 6 hours was therefore adopted for later treatment with mutagens. The total treatment period will be about 12 hours (6 hours with water and 6 hours with chemical mutagen). The duration of treatment with chemical mutagens will also be based on the half-life period of the mutagen solution.

Types of bones
Bones forming the animal skeleton can be classified into two types such as compact bone (cortical) and spongy bone (trabecular / cancellous). The compact bone is found in diaphysis or shafts of all the long bones of forelimbs, hindlimbs and outer surfaces of the flat bones of skull and ribs. In contrast, the spongy or trabecular bone is found in epiphysis or extremities around the bone marrow cavities of long bones and centre of flat bones and vertebrae. As the name implies, the compact bone is solid and hard due to the arrangement of special collagen in the bone (Type I) forming the bands or lamellae parallel to each other surrounded by a cement of proteoglycan ground substance deposited with minerals. Whereas, the spongy bone is made up of meshwork of bone strands running in all directions arranged as trabeculae adapted for weight bearing ability in heads and condyles of long bones.
Structure of bone tissue
The bone consists of bone cells, extracellular organic matrix made of collagen fibres and minerals. The cells of bone are osteoblasts, osteocytes and osteoclasts. Osteoblasts are low columnar to squamous cells responsible for active synthesis and mineralization of bone matrix found mainly in the periosteum and endosteum. Osteocytes are responsible for structure of the bone and calcium homeostasis found in the mature bone. It is located in the lacunae with extensive cytoplasmic processes running through canaliculi with in the bone matrix to make communication between adjacent osteocytes. Osteoclasts are multinucleated (15-30 nuclei per cell) larger cells responsible for bone resorption and remodelling. The secretion of these cells composed of acid and lysosomal enzymes responsible for erosion of bone tissue thereby formation of Howship’s lacunae (Frappier and Eurell, 2006).

Improved varieties, hybrids and quality seeds are considered as the basic and key inputs for the development of agriculture and horticulture. High quality seed production has been the major concern in the Indian sub-continent till 1960s. Before that, India was mostly dependent on USA for food grain. After 1960, Government of India established State Agricultural Universities in different states following “Land grant model” of USA, different ICAR Research institutes and All India Coordinated Crop Research Projects in a systematic manner to give the boost to develop large number of improved varieties with assured seed quality in all major agricultural and horticultural crops. The ultimate intention was to introduce the newly developed high yielding varieties for broad spectrum cultivation in the area of their adoption.
Importance of variety and system of its release
There are several ways and means to increase the crop production and productivity, however using genetically pure and high-quality seed is first and prime objective in agriculture/ horticulture. Govt. of India acknowledged seed as an essential commodity under essential commodities Act, 1955.

Identification of the insects is the integral part of systematics. It utilises all taxonomic procedures. The collections in the world are the accumulation of past taxonomists and are stored for the future identifications. Every species name is based on a published description or figure and usually on the type specimen. Identification is the association of other specimens with the appropriate description or with type specimen.

The steps in identification are as follows:

1. Preliminary key to orders and families

2. Key to genera and species if recent monographs or faunal works are available

3. Reference to the most recent catalogues

4. Reference to current bibliographies for literature published subsequent to the most recent catalogues

5. Reference to original descriptions

6. Comparison with the authentic described specimens or with types.

Environmental agents (xenobiotics) that are injurious to cells trigger a spectrum of responses that can range from cell death to adaptation, repair, and proliferation. Cell death, in turn, can take the form of apoptosis (a programmed form of cell death). Xenobiotics have been implicated in toxic cell injury, among them free radicals (nitrogen, oxygen, and carbon derivatives) are known to interact with cellular constituents including membrane lipids and chromagen materials.

Cytotoxic: Toxic to cells, cell-toxic, cell-killing. Any agent or process that kills cells. The prefix cyto- denotes a cell. It comes from the Greek “kytos” meaning hollow, as a cell or container. Toxic is from the Greek “toxikon” = arrow poison.

In nutshell, cell cytotoxicity refers to the ability of certain chemicals or mediator cells to destroy living cells. By using a cytotoxic compound, healthy living cells can either be induced to undergo necrosis (accidental cell death) or apoptosis (programmed cell death).

Measuring cytotoxicity can prove to be very valuable tool in identifying compounds that might pose certain health risks in humans and animals. Cytotoxicity assays are widely used by pharmaceutical industry to screen for cytotoxicity in compound libraries from initial high-throughput drug screens for unwanted cytotoxicity. This can be of vital importance and prove to be quite indispensable during research phase of developing therapeutic new pharmaceutical products to ensure the safety of end-users. Additionally, understanding the mechanisms involved in cytotoxicity can likewise give researchers a more in-depth knowledge on the biological processes (both normal and abnormal) governing cell growth, cell proliferation and death. Compounds that have cytotoxic effects often compromise cell membrane integrity. Therefore, assessing cell membrane integrity is one of the most common ways to measure cell viability and cytotoxic effects. There are three commonly used methods which can be employed to assess in vitro cytotoxicity (disruption of cell integrity) in cell cultures:

Methods of Analysis

Organic material especially, seeds, grains, fruits and nuts contain mainly three groups of compounds. They are carbohydrates, proteins and fats/oils, mostly in that order. They also contain 3-5% minerals and smaller quantities of vitamins and other minor constituents. Cereal grains contain more of carbohydrates while oilseeds contain more oil. Tree nuts and even oilseeds may contain 30-50% protein while cereal grains contain 5-8% protein. The starch and sugar contents of oilseeds may be less than 10% while the oil content of cereal grains ranges around 5%. The actual content and the composition of these groups of compounds really account for the quality as well as their commercial value.

The composition and quality of grains and other plant products vary with respect to their genetic background, location or the soils under which they are grown, season or the environment, the maturity of the grain/product or its harvest stage and the post harvest processes including storage etc. Crop scientists have in recent years been bringing out made to order or designer seeds, whose quality and composition need to be examined to satisfy the needs of the quality conrol and consumer requirements. Keeping this aspect in view this chapter has been designed.

As this book deals with oilseeds, emphasis has been placed on methods of evaluation relating to thier composition and quality. This chapter deals with methods of oil, protein and sugar analysis. Oil being the major constituent of oilseeds, importance has been given to methods of oil quality evaluation including fatty acid profile. Antinutrients especially aflatoxins, glucosinolates, ricin, oxalate, phytic acid, oligosaccharides, etc. also find a place. Analytical methods of some vitamins and minerals have also been included. Only a few important and most essential procedures relating to oilseed quality have been presented. The analyst can find more details and methods of evaluation of other constituents in standard laboratory analytical manuals.

The Indian Society for Protected Cultivation (ISPC) has organized a National Seminar on ‘Advances in Protected Cultivation’ at the NASC Complex, DPS Marg, Pusa, New Delhi, on 21 March 2013, with an objective of collection and collation of scientific advances made in protected cultivation in India and dissemination of these among policy-planners, farmers, students, scientists, industry and other stakeholders. In spite of the fact that protected cultivation is in its state of infancy in the country in terms of scientific engagements, more than 120 delegates from distant parts of the country registered for the seminar besides good number of policy-planners, recognized names in agriculture and higher officials from industry particularly corporate associate life members of the society.

In the inaugural session, Dr Brahma Singh, President, ISPC and Chairman, Organizing Committee welcomed the Chief Guest Padama Bhushan, Dr R S Paroda, formerly Secretary and Director-General, Indian Council of Agricultural Research (ICAR), New Delhi and Chairman Haryana Kisan Ayog, Chaudhary Charan Singh Haryana Agricultural University , Hisar ; Guests of Honour Dr M M Pandey, Deputy Director-General (Agricultural Engineering), ICAR and Dr H S Gupta, Director, Indian Agricultural Research Institute, New Delhi, other dignitaries on and off the dais, delegates, press and media. He also highlighted that this seminar intended to review the advances made in protected cultivation in India with a purpose to accelerate the same. He emphasized that protected cultivation offers opportunities to earn more from the limited land, water and other resources. It also enables production of quality products which fetch more prices and pride, besides being a potential practice for provisioning disease-free quality planting material for horticultural crops.

4.1 Introduction
Companies that produce tangible items or offer services must drastically increase their productivity in order to maintain their operations in the face of intensifying global competition. A single quantum jump productivity enhancement technique or multiple concurrent incremental improvement productivity strategies can both be used to achieve this goal. If a business chooses the second choice, integrating various tactics for a significant increase in the total productivity would be quite difficult. The only difficulty with this strategy is locating the probable problem area and then using process improvement techniques to achieve the anticipated dramatic increase in productivity. Business process reengineering refers to any significant adjustment of business processes that results in a dramatic increase in an organization’s productivity. Price, quality, after-sales support, adherence to delivery schedules, technological breakthroughs, etc. are some elements that influence market competition. Therefore, the business should focus its efforts on each of these areas in order to achieve notable improvements in terms of decreased operating costs and higher sales revenue from the sale of its goods and services to clients. Improved pricing for a company’s goods or services can provide it an advantage over competitions. Applying various cost-cutting strategies to lower variable costs and overhead costs will lower the price of the good or service. The other elements, viz. quality, after-sales support, delivery schedule adherence, and technological advancements are all directed in this direction

Introduction

Thermal processing is an important treatment for food preservation is, especially in the manufacture of shelf-stable foods with specific nutritional properties. It is also indispensable for determining the sensory properties, particularly, colour, flavour, and texture of fried, baked, and roasted products. As a result of heat treatment, chemical changes induced, and a plethora of new molecules are formed in foods, some of which have been claimed to be health-promoting antioxidants and anti-mutagens. However, reports suggest that thermal processing leads to the formation of certain toxic compounds, so-called process-induced contaminants in foods. The process-induced toxicants are certain compounds which are formed in food as a result of food processing, exert adverse toxicological effects, and cause potential health risks to humans. Acrylamide, furan, chloropropanols, heterocyclic aromatic amines, polycyclic aromatic hydrocarbons, and N-nitrosamines are some well-known examples of thermal process contaminants.

• Adiabatic Processes: Adiabatic cooling occurs when air rises and expands, reducing its temperature (Fig. 9.1). This process can lead to condensation and cloud formation. There are several ways air can rise and cool adiabatically:
• Orographic Lift: When air is forced to rise over a mountain or hill, it cools, and condensation occurs, resulting in clouds and precipitation. This is why mountainous regions often experience more rainfall than surrounding are as.
• Frontal Lift: When two air masses with different temperatures and humidity levels meet, the warmer air is forced to rise, cool,
and condense, forming clouds and precipitation. This can lead to significant weather changes, such as the formation of fronts and lowpressure systems.
• Convection: When the sun heats the ground, it warms the air closest to the surface, causing it to rise and cool, leading to condensation and cloud formation. This process can lead to the development of cumulus clouds, thunderstorms, and other types of convective weather.

Abstract

Kulfi is a mixture of fat; sugar and milk solid not fat together with added flavour. So diabetics people on restricted diets cannot consume kulfi having normal ingredients. Now-a-days, consumers demand for low fat/calorie products has significantly raised in an attempt to limit health problems, to lose or stabilize their weight and to work within the frame of a healthier diet. The role of fat replacers and sugar substitutes in the successful manufacture of these products is crucial. Development of sugar free kulfi would certainly ensure diabetic/obese people to enjoy ice cream/ kulfi. The current study is to standardize the kulfi recipe with fat and calorie replacer. Basic formula mix consist of Whole milk 60 percent, SMP 12 percent, Sugar 13 percent, Cream 15 percent and Stabilizer 0.5 percent where the whole milk was replaced by skim milk, cream and sugar was replaced by maltodextrin as a bulking agent and aspartame respectively alongwith sodium alginate as a stabilizer. The replacers were incorporated at four different levels of 0, 25, 50, 75 and 100 percent to the basic formula mix. Freezing of above kulfi mix was done by traditional method and softy freezer method. Sensory evaluation was carried out by using 9-point hedonic scale through semi-trained judges and results were statistically analyzed. On the basis of sensory scores it was revealed that sugar could be replaced 100% by artificial sweetener, bulking agent (Maltodextrin). It was found from the sensory scores that the milk fat in kulfi can be replaced upto 75 percent by sodium caseinate thereafter increase in caseinate gives prominent flavour of casein and kulfi body becomes thick and hard. It was concluded from the results that 100 percent sugar replacement was found feasible in preparation of low fat and low calorie kulfi. Results of the low fat and low calorie kulfi mix indicated that there was 32.29 percent reduction in the calorific value of experimental kulfi as compared to the control sample (traditional). It was concluded from the results that the kulfi with 75 percent less fat and 100 percent sugar free can be prepared with low cost in comparison with control.

Fruit beverages

Fruit beverages are highly refreshing, thirst quenching, appetizing, easily digestible and nutritionally far superior to synthetic drinks. The fruit beverages includes natural and sweetened juices, squash, syrup, cordial, nectar, Ready to Serve (RTS) beverages, fruit juice concentrate and citrus juice barley water. Fruits most commonly used to prepare beverages are oranges, lime, pineapple, grapes, cashew fruit, mango, jack fruit, apple etc. To prepare fruit beverages select fresh, fully ripe, tart, juicy and seasonal fruits.

This chapter delves into the dynamics of fruit processed products in both local and international markets, exploring the challenges, opportunities and strategies for sustained success. Fruit processing plays a crucial role in adding value to horticultural produce, enhancing shelf-life and meeting the diverse demands of local and international markets. In India, a country blessed with abundant fruit varieties, the processed fruit industry has been witnessing significant growth, catering not only to the domestic market but also making strides in the global arena. The processing of these fruits into various products such as juices, pulps, concentrates, jams and dried fruits has emerged as a thriving industry. This chapter will provide insights into the current state of fruit processed products in India, their importance for both local consumption and export markets, challenges faced by the industry and potential avenues for the future growth.

Introduction

India, with its unique agro climatic conditions is capable of producing a wide variety of fruits and vegetables. These highly perishable produce in both fresh and processed forms are of high demand in domestic as well as international market. Nowadays farming is becoming an enterprise and shifting towards consumer driven agriculture. Produce quality measurement is of utmost importance as consumers are more quality conscious and ready to pay higher for quality. Consumer preference is moving towards healthy food, minimally processed and, fresh cut fruits and vegetables, prepared salads, ready to cook, ready to eat and ready to drink health beverages. Hence health, nutrition, convenience, quality and safety of produce should be guaranteed to the consumers. Due to globalisation of production and trade, legislations and standards for markets are strict and product quality is the necessity for competitive markets.

Quality of a produce, based on subjective and objective measurement, is defined differently by consumers, wholesalers, retailers, processors or any other who is associated with it and varies with market either national or international. Quality of foods may be defined as the composite of those characteristics that differentiate individual units of a product, and have significance in determining the degree of acceptability of that unit to the user (Kramer, 1965). According to ISO (International Organisation of Standardisation), “Food quality is the totality of features and characteristics of a product that bear on its ability to satisfy stated or implied needs” and as per CAC (2003), “Food safety is the assurance that food will not cause harm to the consumer when it is prepared and/or consumed according to its intended use”. Food safety is the most important component of quality.

Processed fruit and vegetable are considered as staple food products throughout the world, and are becoming more popular with the increase of the global urban population. As a result, demand for processed fruit and vegetable products tends to increase with population growth in the world. There is strong demand for processed fruits and vegetables in the developing world over the past few years. In poor countries, people consume less fruits and vegetables due to the relatively high prices. All forms of preserved fruits and vegetables are available only to the urban elite people. But rural mosses producing more than 90 % of these fruits and vegetables are usually deprived of their uses.

Introduction

Rice is grown in more than 100 countries in the world and is an important crop for nutritional security of large part of the population. World rice production in 2007 was approximately 645 million tones. Around 50 countries have an annual production of more than 1 million tones. Ninety percent of the total rice is produced in Asian countries, with two countries, China and India, growing more than half the total crop. Top ten rice producing countries are China, India, Indonesia, Bangladesh, Vietnam, Thailand, Myanmar, Japan, Philippines, and Brazil. In Bangladesh, Cambodia, Indonesia, Lao PDR, Myanmar, Thailand, and Vietnam, rice provides 50-80% of the total calories consumed. Major part of the rice is consumed locally where produced and only 6-7% of world rice production is traded internationally.

3.1. General Introduction

Value addition refers to the conversion of a raw commodity or commodities into a processed product through the use of raw materials, labour, time and technology, all mixed in a way that ensures increased economic return. Even if the amount of processing in a product is much less, for example, any canned fruit can be considered as a processed product. Value added processing of horticultural food crops, mainly involves actions which changes fresh fruits and vegetables to create a greater value-added product for human consumption, which mostly includes canned products, juices, soups, sauces and dehydrated fruits and vegetables (Sharan, 2018). It results in diversification of agricultural activities, improves value addition opportunities and creates surplus for export of processed agro products. Processing often goes with perishable products like meat, milk, poultry, fruits and vegetables, often termed as High Value Products (HVPs), are in greater demand of processing (Sanal & Krishna, 2017). The demands for processed products are particularly strong in developing countries like China and India; mainly due to increasing industrialization and rapid urbanization, followed by elevated income levels, greater diversity in diets, and affinity towards premium-branded products (Sharan, 2018).

1. Black pepper

Processing involves the following steps:

1. The fresh berries are dipped in hot water for a minute which results in an attractive black colour and also reduces the drying time.
2. The berries are separated from the spikes and dried in the sun for 7-10 days.
3. When dried, the berries retain the characteristic wrinkled appearance of black pepper of commerce.

Introduction

Maize (Zea mays, or corn as it is known in some countries) is the principal cereal crop in tropical and subtropical regions throughout the world. The increasing use of maize as a staple food reflected the much higher yields per hectare, compared with wheat, rye and barley. Because maize was cheap, it became the dominant food and main source of dietary energy and protein for poor people, particularly those in rural and underprivileged segments of society. Maize is considered to be a native of the Americans. There are different views about the introduction of maize in India. One view is that maize was introduced into India by the Portuguese during the seventh century. Other view is that maize was introduced in Pre-Colombian era through the Atlantic Arabian trade route. This is supported by the more recent variability that has been observed in the maize collections made from the north eastern Himalayan region. However, the historic records regarding the cultivation of maize in India date back only to the Maratha Empire.

I. INTRODUCTION

Horticultural crops include fruits, vegetables, flowers, plantation crops, spices, and medicinal and aromatic plants have emerged as a major economic activity in India. It contributes 30% GDP from 11.73 % of its arable land area. Horticulture crops cover over 23.4 million hectares of area, which is approximately 12.7% of the total gross cropped area of the country and contributes 18-20% of the gross value of India’s agricultural output (NHB, 2013). India is the world’s second largest fruit and vegetable producing country accounting for 77.7 million metric tonnes of fruit and 159.5m M tonnes of vegetables (NHB, 2013). Besides, about 5.66 million tonnes of loose flowers, spices, mushroom and aromatic plants are also produced. The country produces 41% of world mangoes, 23% banana, 24% cashew nut, 36% green peas, 10% onion and 30% cauliflower and accounts for 12% of world fruit and 13.25% of vegetable production (NHB, 2013). Owing to wide diversity of agro climatic conditions, almost all types of temperate (apple, peach, plum, apricot, cherries and nuts), subtropical (mango, guava, papaya, etc), tropical (banana, pineapple etc), arid fruit (ber and aonla), plantation crops (coconut, cashewnut and arecanut) and diverse variety of vegetables are grown in India. The export of fresh fruit and vegetables from India in 2006-07 was estimated at 9.84 Lakh tonnes valued at Rs 2411.70 crores. Mango, grapes, apple, onion, potato, green vegetables like okra, bitter gourd and green chillies were the major items of export. Similarly, India exported 5.97 Lakh tonnes of processed foods comprising of mango pulp, juices, concentrates, dried and processed vegetables, pickle and chutney, alcoholic and non-alcoholic beverages worth Rs 2818.1 crores (APEDA, 2012) (Table 1 to 3).
