The different qualitative chemical tests can be performed for establishing profile of given extract for its chemical composition. The following tests may be performed on extracts to detect various phytoconstituents present in them.

Quality Adjusted Life Years (QALYs) : Calculated by adjusting the estimated number of life-years an individual is expected to gain from an intervention for the expected quality of life in those years. The quality of life score will range between 0 for death, to 1 for perfect health, with negative scores being allowed for states considered worse than death

The ultimate aim of production, handling and distribution of vegetables is to satisfy the consumers, and it is well known fact that consumer satisfaction depends on quality of the produce what he gets (Shewfelt et al., 1997). The term quality implies the degree of suitability of produce for a particular use. Quality can be expressed as an absence of defects or degree of excellence of the produce in respect to appearance, i.e., size, shape and colour. Quality is a bundle of attributes that are inherent in the produce and can readily be quantified throughout handling and distribution. It may also be defined as a series of attributes selected based on accuracy and precision of measurement. For grades and standards, the definition of quality is institutionalized so that it may have the same meaning for every one using it. Combination of characteristic features of the produce itself is termed as quality and that the consumer’s perception and response to those characteristic features should be referred to as acceptability.

Quality of produce encompasses sensory properties, such as appearance, texture, odour, aroma, taste and flavour that are readily perceived by the human senses and hidden attributes, such as safety, chemical constituents, nutritive values, mechanical properties, functional property and defects that require sophisticated instruments to measure (Abbott, 1999). Combination of sensory and instrumental measurements of quality attributes provides an estimate of customer acceptability. In a long chain from producer to the actual consumer, each passes judgment and each has his own set of acceptability or quality criteria, often biased by personal expectations and preferences. The component attributes of quality vary with context. The choice of what to measure, how to measure it and what values acceptable to the consumer are determined by the person requiring the measurement, with consideration of the intended use of the produce. Quality can be measured, and it relates to consumer acceptability.

Wool is a natural fiber that possesses numerous outstanding characteristics, rendering it both functional and visually appealing. Nevertheless, not all wool is created equal; there exists considerable variation in the quality found in the marketplace. This explains the significant fluctuations in price, as some wool is of superior quality and therefore commands a higher price. Various factors influence the quality of this fiber and, consequently, its value. Below is a list of some of these factors.
a) The diameter of the wool fiber is the most critical factor affecting its quality and price. Generally, merino wool is regarded as the highest quality due to its fine texture, which produces an exceptionally soft fiber. In simple terms, the finer the wool, the greater its worth.
b) Consistency in fiber diameter is another vital aspect; the more uniform the fiber, the higher its value.
c) The colour of wool also plays a significant role in determining its value. Wool that is white or off-white can accommodate a wider array of dyes used in fabric manufacturing.
d) Staple strength is a measure of the fiber’s capacity to endure the production process. A higher staple strength results in less waste during manufacturing. Wool is a valuable by-product of sheep, differentiated from hair by its enhanced elasticity, flexibility, and curliness. The quality of wool is affected by factors such as shrinking, strengthening, and felting conditions. In their natural form, wool fibers are coated with wool grease (sweat) and wool soap or yolk (suint), which are secreted by specialized glands to preserve the wool’s condition. Wool is classified into three primary types of fibers:

In India farming was traditionally subsistence in nature but with the passage of time, the nature of farming has changed to commercialized system faming. With the commercialization of farming, price of the product along with its quality has become an important factor in marketing. Quality and safety issues have also gradually gained importance as people in general have become conscious and aware of the hygiene, health and safety issues related food and food products. Perishability of food items requires more emphasis on its quality and safety. The formal system of regulations in quality and safety standard has been mainly the contribution of the developed world. The International market has set a high standard of quality and safety of agriculture products. In the country the standardization of quality and safety of agricultural products has gained momentum in the last 10-15 years.

Hazard Analysis and Critical Control Points (HACCP)

Hazard Analysis and Critical Control Point is a comprehensive food safety system of food which starts from production to the ultimate consumption. HACCP monitors each and every step of production process, identify the specific hazards, implement the effective control programme and also verify the procedure. However, it is not a zero risk programme and there is possibility of risk of hazards in the process but the theme of programme is to minimize the risk of hazards upto a level which will be considered as safe. Thus HACCP programme is termed as risk management tool. It involves the management of all types of hazards like microbiological, chemical and physical.

The raw material of foremost importance in bakery product is the wheat flour. Bakery units prefer the flour obtained by milling in roller flourmill with 70– 72 percent extraction. Flour quality may be defined as the ability of the flour to produce an attractive end product at competitive cost, under conditions imposed by the end product manufacturing unit. The concept of quality differs from producer and consumer point of view. However, in general, the term quality may refer to fitness of a raw material or a product for a particular process or consumer. For a consumer, the following parameters are important criteria of a product quality.

The art of confectionery manufacture date back to over 3000 years as per Egyptian records. Traditionally honey, boiled and concentrated sugar cane juices have been used in confectioneries. In modern times, alternative sweeteners from sources like corn and starches constitute an integral part of confectionery manufacture.

Owing to the huge variation in finished products as well as raw materials in food sector, Quality control has an extremely important role to play. Quality control aims at controlling variation to within a tolerable level by taking corrective actions. Statistical and non-statistical techniques are employed to measure, analyze and control variation in food products. Statistical process control, acceptance sampling and visual inspection are widely used in food and allied sectors.

Maintenance of quality and manufacture of a standard confectionery should involve a very close control of raw materials, instrumentation, and statistical analysis of finished product. Statistical evaluation with respect to finished product includes weight control, sensory evaluation and packaging tests. The quality standards are set by the quality control departments. Chemists may undertake preliminary analysis through visual inspection. Visual inspection is usually combined with sampling. This gives an idea of variation, cleanliness, infestation etc. in the sample.

India has emerged as the largest producer of milk in the World. This has boosted the confidence of producers, planners, dairy entrepreneurs and scientist alike. India has poised to play a major role in global dairy market in coming decade. The rapid growth of science and technology has positive impact on our life style and with strong trend of urbanization several demographic changes are likely to occur. There going to be ever increasing demand on the role of milk and milk products for human health. Accordingly, the demand for higher standards of milk products in terms of hygiene and safety of dairy products is to be followed. The competitiveness for the export of milk products among different dairy industry has increased in recent times due to GATT agreement. The biggest challenge before Indian dairy industry is the quality and safety of milk products indented for human consumption. Legal standards are made to have control over quality of food offered for sale and to safe guard the consumer form health hazards. It is therefore, imperative to determine different parameters that define product quality and safety. The purpose is to ensure production and distribution of products within well defined and accepted standards. This chapter deals with various parameters of product testing in order to maintain requisite prescribed standards.

Milk is a product of biological origin and is a suitable vehicle to accommodate any additive without apparent changes in its look. The quality of milk and its products depends upon quality of raw milk used in their manufacture, processing and handling conditions. It is therefore, necessary to check quality of raw milk to assess its suitability for processing, through various quick tests called “Platform Tests”

Raw milk quality assessment

(A) At collection center: - Milk from various suppliers is generally collected at dairy factory or privately owned collection centers located in marked area of milk sheds. The quantum of supply may vary from 2 – 100 Liters. As each supplier has to be paid in relation to quantity and quality of his produce, it is important to draw samples and ascertain its quality by performing quick tests for the purpose of acceptance or rejection.

Sampling procedures - The sampling procedure differs according to the nature of material and the purpose for which the sample is required. The sample collected for chemical analysis should be representative of the entire batch. Thorough mixing with proper instrument is essential to ensure representative sample. Samples for chemical analysis are to be delivered the same day for testing. If un-avoided, add small amount of preservative (Formaldehyde) to prevent deterioration and bear label to the effect.

Sample from single container – The procedure involved is thorough mixing of contents. If it is small container the contents should be poured from one vessel to another with swirling. In case of can the contents should be mixed with the help of plunger which should be moved up and down and sideways for about 10-15 times. The sample is then drawn with the help of dipper from different levels and collected in clean and dry sample bottles.

1. Introduction:- Overview of Good Laboratory Practices (GLP)
1.1 Definition and Scope of GLP
GLP refers to a set of standards that govern the organizational processes, personnel responsibilities, and conditions under which laboratory studies are conducted. It aims to regulate research environments and ensure the generation of high-quality, traceable, and reproducible results. The scope of GLP encompasses a wide range of scientific fields including pharmaceuticals, agrochemicals, veterinary products, and environmental safety assessments. Good Laboratory Practices (GLP) regulations were developed by the Organization for Economic Co-operation and Development (OECD) and well adopted by regulatory agencies world-wide. The primary objective of GLP is to promote high standards of accuracy and integrity in non-clinical research to protect human health and the environment.
1.2 Principles of GLP
The fundamental principles of GLP include:
• Study Planning and Protocol Development: Every study must have a clear plan and defined objectives, which should be outlined in a comprehensive protocol.
• Personnel Responsibilities: The roles of study directors, scientists, quality assurance personnel, and support staff are clearly defined.
• Test Systems and Facilities: Laboratories must maintain appropriate facilities and control systems for conducting studies. These include properly calibrated equipment, controlled environments, and standardized procedures.
• Data Integrity and Reporting: Data must be meticulously recorded, verified, and archived, ensuring it is traceable and reproducible.
• Study Documentation and Archiving: All records, raw data, and reports must be stored and accessible for a period defined by regulations, ensuring transparency and reproducibility.

Molecular diagnostics has witnessed groundbreaking technological advances in recent times, starting from automated sample preparation to real time amplification technology. Possibility to develop and run assays for ever increasing number of clinical queries has become effortless due to the technological advances. However, the state of the art in quality assurance and quality control practices for molecular diagnostics has seldom been up to the expectations if one considers accuracy for once in a lifetime genetic tests or new genetic test targets appearing almost every single day. In the face of such issues, clinical laboratories are struggling to develop appropriate quality assurance programs for the molecular diagnostic tests they conduct. In addition, legislation and government policies threaten to increase oversight of genetic tests to a level not seen before in laboratory medicine, for example, FDA’s guidance on in vitro diagnostic multivariate index assays (IVDMIA).

To relate patient results to previous test results or to absolute values in clinical practice guidelines, those results need to be comparable across time and methods. This may either be achieved by designing the identical value across methods and test versions or by using reliable and stable conversions. Therefore, the establishment of international standards and reference materials is of paramount importance. Monitoring molecular test system outputs and statistical analysis might provide a good way to obtain such standards; however, such traditional QC (Quality Control) strategies can be slow to take root in molecular diagnostics.This chapter highlights general and specific issues relevant for quality assurance and quality control in the routine molecular diagnostics laboratory and guidelines for designing quality manuals for a molecular diagnostic laboratory.

India has achieved a commendable position of being the highest milk producing country in the world. Nearly 110 million tons of milk per annum is contributed by small and marginal farmers having 2-3 milch animals which are scattered in lakhs of villages across the length and breath of India. The poor socio-economic conditions are serious constraints in producing raw milk of good quality. The quality of milk is further deteriorated during subsequent handling and transportation. Milk being a product of biological origin, is extremely vulnerable to attack by microbes. It is also a good vehicle for additives and adulterants without any apparent changes in its appearance. Thus, milk is susceptible to several post-secretion changes, some natural and some man-made.

Indian dairy industry faces a mammoth task to meet the world quality standards, particularly in the present context of globalization and increasing quality conscious consumers. In view of the highly perishable nature of milk soon after it is secreted, it is important to monitor its quality by having a firmly installed quality assurance programme along the entire production-to-supply chain. This can be possible with application of sensitive, accurate and rapid methodologies as a tool in quality assurance programmes.

Quality comprises of several attributes ranging from physical, chemical, technological and bacteriological through nutritional to aesthetic. All dairy plants have a quality assurance laboratory (Fig. 8.1) and usually follow chemical quality control with the intention of payments to contractors/producers, processing of milk and meeting mandatory requirements for end products. Quality is judged both by objective and subjective tests.

Quality assurance is essential for supplying consistent, defect-free textile and apparel products that satisfy customers, buyers and regulatory requirements. It is a proactive, process-oriented approach through which quality is planned and incorporated into every stage of production instead of being checked only at completion. Unlike quality control, which detects existing defects, quality assurance prevents defects through careful planning, training, process design and standardization. Its objectives include establishing appropriate standards and operating procedures, ensuring traceability and accountability, supporting continual improvement through audits and feedback, and developing an organization-wide quality culture. Accordingly, responsibility for quality extends from production operators to supervisors and senior management.

Essential oils are products of secondary metabolism and are secreted by specialized cells located in specified parts of most plants. By virtue of certain characteristic properties, they have wide spread use in perfumery, flavouring and medicine. Essential oils are variable mixtures of terpenoids. Since these oils are produced by plants, composition varies with species and variety of plant besides geography, climate and cultivation practices. Since, chemical components are highly reactive, physical and chemical environment to which oil is subjected to during the processes of its extraction, processing and storage have a great influence on final composition. Entire chain of activities from cultivation, extraction, processing, storage to packing has to be perfectly standardized and regulated to assure end product consistency. Being a valuable item of trade, this is important from the point of view of delivering desired activity as well as safety to consumer.

We all are familiar with the word “quality”. If we bring some fruits or vegetables from the market, the other family members will reflect on their quality by making observations such as: fresh or stale, good or bad quality or inferior product, etc. These observations are perceptions of consumers based on the sensory attributes of the fruit or vegetable colour, appearance, touch, smell or taste.

The quality characteristics of food that are acceptable to consumers are comprehended under the term “Food Quality. It includes external factors such as appearance (size, shape, colour, gloss, and consistency); internal factors (chemical, physical, microbiological) and characteristics/ specifications prescribed under the Government laws/standards. If consumer’s perceptions regarding quality of food are not positive he or she either will not purchase the material or will be paying less compared to when the consumer has positive perception about the quality.

The relationship between quality, profitability and market share has been well established. In the quest of quality, the dairy business is passing through revolutionary changes and the need for such changes has been very well realized. The leaders have initiated the process of setting vision and are working hard to provide the basic infrastructure with necessary resources. This has become a point of vital importance as the nation has now captured the first rank in milk production globally and is now ready and set to march ahead in the global race for dairy products market. Our country has great potential to export the dairy products such as cheese particularly Mozzarella, Feta, and indigenous products such as ghee, khoa, chhana, paneer, and array of sweets. Food items or dairy products to be traded in the international markets should be manufactured in accordance with global accepted norms and standards. In order to improve the quality of milk and milk products the Government of India is focusing on “Clean Milk Production”. As a dairy technologists and entrepreneurs, we must ensure production of quality products.

Introduction

Seafood undergoes rapid spoilage after capture or harvest due to their highly perishable nature. Spoilage refers to any change that renders seafood unacceptable for human consumption. Spoilage occurs as a consequence of various microbial, biochemical and chemical breakdown processes. Spoilage leads to quality changes in seafood. Quality change refers to any change that occur after harvest due to unpredictable catch, uncontrolled harvest, inadequate handling, processing and storage facilities. The initial quality loss is mainly due to the post-mortem autolytic activity (enzymatic process) and chemical degradation process (lipid oxidation); and later by microbial degradation. The quality problems occur as a result of poor-quality raw material, ice and water, microbiological contamination, presence of heavy metals and other storage aspects during processing.

Processing of fish means preparing raw fish into a marketable form. Pre processing is done prior to final processing. Pre-processing is often done on board fishing vessel or in a shore based plant. It includes operation such as washing, sorting, grading, butchering, etc of the harvested fish. The butchering involves removal of non-edible portions such as viscera, head, tails and fins from fish. The yield of fish meat varies from 30 to 70% depending on the butchering process. Butchering process includes beheading, gutting, filleting, peeling, deveining, shucking, etc. The discarded portion of fish meat are fish wastes, often used for animal feed or for conversion to bioactive functional foods. Final processing of fish includes processes such as heating, freezing, drying, salting, marinading, irradiation, or addition of chemicals. The processed seafood is categorized into five major groups – chilled, frozen, canned, cured and other value-added products in this chapter.

56.2. Theory

The quality of dried/dehydrated products can be measured by estimating moisture contents, preservatives level, acid insoluble ash contents and most importantly enzyme reactions.

56.3. Estimation of Acid insoluble ash

1. To total ash add 25 ml of dilute HCl (10% w/w)

2. Cover with a watch glass and boil gently over a low flame for 5 minutes

3. Filter and wash the filter paper thoroughly with hot water

4. Return the paper to the original dish, ignite, cool and weigh the insoluble ash

Objective: To check quality of genomic DNA on agarose gel electrophoresis.

Background information

Agarose gel electrophoresis is a common method of gel based electrophoresis technique used in biochemistry, molecular biology, genetics and clinical chemistry for separation of Protein and nucleic acids from a mixture of macromolecules. Agarose is a major component of agar that is used as a matrix in gel baseelectrophoresis. The nucleic acids (DNA and RNA) are separated based on length of fragments while, proteins are separated based on size and/or charge (Kryndushkin, et al. 2003). For separation of bio-molecules the electric field is applied that leads to movement of charged particles via agarose gel matrix and bio-molecul s are separated based on difference in size in the agarose gel matrix (Sambrook and Russel, 2001).

Gel casting with agarose is easy and has very few charged groups, hence found most suitable for nucleic acid separation in most of the biochemistry, molecular biology and biotechnology laboratories. Separated DNA/RNA ma be seen and recorded with stain under UV light. Further DNA fragments can be eluted from agarose gel with an ease for further down applications. The percentage of agarose gel used is in the range of 0.7 - 2. Lower percent of agarose gel is used for long DNA fragments while, higher percent of agarose gel is used for short DNA fragments with suitable running buffer.

Objective: To check the integrity of isolated RNA on agarose gel.

Background information:

The most common method used to assess the integrity of total RNA is to run RNA sample on agarose gel (denaturing) stained with ethidium bromide (EtBr). While native (non-denaturing) gels can be used, the results can be difficult to interpret. The secondary structure of RNA alters its migration pattern in nativegels so that it will not migrate according to its true size. Nondenaturing conditions also result in bands that are not as sharp, and even multiple bands representing different structures of a single RNA species.

Intact total RNA run on a denaturing gel will have sharp, clear 28S and 18S rRNA bands (eukaryotic samples). The 28S rRNA band should be approximately twice as intense as the 18S rRNA band. This 2:1 ratio (28S:18S) is a good indication that the RNA is completely intact. Partially degraded RNA will have a smeared appearance, will lack the sharp rRNA bands, or will not exhibit the 2:1 ratio of high quality RNA. Completely degraded RNA will appear as a smear (having very low mw). Inclusion of RNA size markers on the gel will determine the band size or smears size and will also serve as a good control for ensuring proper gel run. Note: Poly selected samples will not contain strong rRNA bands and will appear as a smear from approximately 6 kb to 0.5 kb (resulting from the population of mRNAs, and depending on exposure times and conditions), with the area between 1.5 and 2 kb being the most intense (this smear is sometimes apparent in total RNA samples as well).

Quality control significantly affects manufacturing output, productivity and operational excellence. Techniques such as Six Sigma and DMAIC systematically identify the occurrence and causes of defects while developing solutions to reduce them. Total Quality Management further improves quality and lowers costs associated with defects, wastage and rework. Common tools employed in garment manufacturing include flow charts, check sheets, histograms, Pareto charts, scatter diagrams, control charts and cause-and-effect diagrams. Their systematic application supports continuous process improvement and better economic performance. Because the textile and apparel industry faces intense competition in domestic and global markets, manufacturers must shift from simple product inspection towards integrated, preventive and continually improving quality-management systems.

Despite its existence and continued use over many centuries, and its popularity and extensive use during the last decade, traditional medicine has not been officially recognized in most countries. Consequently, education, training and research in this area have not been accorded due attention and support. The quantity and quality of the safety and efficacy data on traditional medicine are far from sufficient to meet the criteria needed to support its use worldwide. The reasons for the lack of research data are due to not only to health care policies, but also to a lack of adequate or accepted research methodology for evaluating traditional medicine235.

The statement from General Guidelines for Methodologies on Research and Evaluation of Traditional Medicines (World Health Organization, 2000) highlights the need for consensuous in addressing the problems related to the quality of botanical drugs, which ultimately is a critical determinant of safety and efficacy of medicine. Further, the distribution and widespread sale of adulterated, misbranded, spurious botanical drug products and marked increase in misleading health claims of these products demands proper regulations on botanical medicine to protect public health236. Considering these two issues development of parameters for quality control standardization and regulatory norms for controlling the growing business of botanicals is a big task. Various regulatory authorities, research organizations and botanical drug manufacturers are constantly contributing to developing guiding principles addressing issues related to quality, safety and efficacy237. In this chapter we have highlighted problems associated with quality control of the botanicals and tried to guide a way towards a globally acceptable quality standard.

1.introduction

The total sum of foods or mixture of foods which an individual consumes each day is referred to as his diet (Okey, 1992). Vegetables that are used as food has nourishing substances called nutrients namely carbohydrates, proteins, fats, minerals and vitamins. The nutritive value of different vegetables varies sufficiently and the usage of variety of vegetables ensures all the necessary nutrients required in the diet and its lack in daily menu may result in various disease and deficiencies (Saxena, 1970).  They contain a great variety of all other phytochemicals, some of which claimed to have antioxidant, antimicrobial and also anti-carcinogenic properties (Grudha et al., 1996). But when soaking is done in water either plain or salted with sodium chloride, water soluble nutrients may be leached into the water (Srilakshmi, 1999). An attempt was made in the present study to find out the effect of soaking of some selected vegetables in water for one hour after cutting them into pieces and its nutrient loss.

Most raw feed ingredients used as an energy and/or a protein source in poultry feed are grown, harvested, processed, and transported from outside of the poultry industry. Poultry feed are routinely subjected to contamination from diverse sources which may have a serious consequences on the safety of poultry products. Public concerns over food safety from the food of animal origin is a cause of global concern in the recent years due to problems such as bovine spongiform encephalopathy (BSE), dioxin and melamine contaminations, microbial resistance to antibiotics and outbreak of food borne bacterial infections (food poisoning) (Panda, 2013).

Adulteration in animal and human foods has become common feature in the country, therefore we should be cautious while selecting animal/human feed ingredients.

The author of this compendium has developed. “Animal Feed Testing Kit” based on novel cud liquor enzyme complex (innovation certified by ISA, International Search Authority - Patent office, Vienna), registered with WIPO (Geneva). This method is described in detail in this chapter and Patent application is field at Indian Patent Office Delhi.

Now-a-days, animal feed is being adulterated with extraneous materials viz, Saw dust, Ric hulls, sand and Silica, Castor husk, oat hulls and urea (higher than 01 percent limit on dry matter basis).

Quality control in fish feed manufacturing plays a vital role in ensuring the safety, nutritional value, and uniformity of the final product. It involves a structured set of procedures carried out throughout the entire production cycle— from sourcing raw materials to packaging the finished feed—to confirm that the product adheres to standards that support fish health, growth, and environmental stewardship. At the initial stage, raw materials are tested for factors such as moisture, protein, lipid content, fiber, ash, and the absence of harmful elements like aflatoxins, pesticides, or heavy metals. Leading feed manufacturers enforce strict supplier verification and sampling routines to maintain ingredient quality and authenticity. During production, critical parameters are routinely checked, including grind size, mixing consistency, and temperature and moisture levels during conditioning. The physical integrity of pellets is also evaluated during extrusion or pelleting. Specific performance indicators—like water stability, floatability for floating feeds, and feed conversion ratios (FCR)—are assessed to determine feed effectiveness. Post-production checks include examining the pellet’s appearance (size, shape, and color), along with chemical assessments

Biofertilizers are one of the important components of organic farming and sustainable agriculture. Awareness among farmers is increasing on the biological fertilizers. But, the success of biofertilizer inoculation depends on the quality of the inoculant used. Because farmers are unable to judge the quality of the inoculants at the time of purchase or even at use. The inoculant producers are negligent to institute quality control programmes. Unfortunately much of the inoculant produced in the world today is relatively of poor quality. In such situation maintaining high quality inoculant products depend on the internal implementation of effective quality control systems by manufacturer. A major goal of a quality standard is to control the quality of inoculant to be used in any country.

Quality Control is very important in biofertilizer production, which determines the efficiency of microbial strains. Generally, the quality control based on BIS are voluntary in nature. However, some of the biofertilizers are brought under the ambit of Fertilizer Control Order 1985 (FCO) during 2006 (Yadav and Chandra, 2014). At present, biofertilizers are under the FCO with specific quality standards. Biofertilizer production and its sales can be regulated and is a mandatory requirement for registration of manufacturing unit with the State Fertilizer Controller (who is generally the Commissioner or Director of Agriculture Department) under the statutory provision of FCO. Moreover, some officers of the Agriculture Department have been declared as Fertilizer Inspectors at the district level, who are authorized to inspect production and storage facilities and draw samples for quality analysis. National Centre of Organic Farming (NCOF), Ghaziabad under the Govt. of India and its six Regional Centre’s located at Bhubaneswar, Bangalore, Jabalpur, Nagpur, Hissar and Imphal have been declared as testing laboratories. Under the provisions of the FCO act, State Governments can also develop their own quality control laboratories and notify them under the FCO (1985). Peat, lignite, peat soil, humus, wood charcoal or similar material favouring the growth of microbial strain could also be used. Preservation methods are generally believed to be responsible for a depletion of naturally occurring antioxidants in food. Processed fruit and vegetables are expected to have a lower health protecting capacity than fresh ones. This is because, up to now, only selected and barely stable antioxidants of nutritional interest (e.g. ascorbic acid) have been commonly assessed as indicators of processing damage. On the basis of these supposed negative effects, in the past few years, the main tool for minimizing eventual processing damage was the strategy of ‘reconstitution’, achieved by the addition or the enrichment of the product with natural antioxidants.

It is well known that food processing can have many effects not all of which result in a loss of quality and health properties. Blanching also represents a useful tool in preventing enzymatic oxidations, which are the main cause of loss in naturally occurring antioxidants in raw material of plant origin. In fact, fruit and vegetables subjected to blanching retain most of their original antioxidant properties.

Lycopene appears to be a relatively stable compound during food processing but it has been reported that heating tomato pulp to produce paste, ketchup, juice and other products, can cause degradation of lycopene and other carotenoids. Other antioxidants naturally present in tomato, such as vitamin C, vitamin E, polyphenolic flavonoids and non-lycopene carotenoids, may play a role in preventing the degradation of lycopene. Thermal processes might break down cell walls and weaken the bonding forces between lycopene and the tissue matrix. Such disruptions in the cell wall fraction may enhance the release of phytochemicals from the matrix. This may make lycopene more accessible or more stable and thus increase the nutritional quality and antioxidant activity of product. An increase in carotenoids by thermal processing has also been attributed to enzymatic degradation which causes weakening in protein-carotenoid aggregates. Destruction of vitamin C is destroyed mainly due to oxidation reactions and the heat applied in the presence of air. The degree of loss of ascorbic acid is closely correlated to the drying temperature used for the production of the end product. The increase in the amounts of some phenolic substances having antioxidant activity was associated with two concomitant events: firstly, the thermally induced extraction of antioxidant molecules previously complexed or polymerized and secondly, the retention of active compounds caused by the inactivation of the enzymes involved in their catabolism.

The organic quality is based on standards, inspection, certification and accreditation. All organic food is produced and handled according to strict rules called ‘Organic Standards’. Organic standards do not define a quality status which can be measured in the final products (e.g. quantity of pesticides residues, heavy metals, etc). They define the way of production (e.g. that no chemical pesticides and fertiliser are used).

“Quality Control” constitutes the very backbone of the success in any industry, in any field of activity, may it be agriculture or spices, since quality is never an accident, but, the result of a conscientious effort, as rightly visualized by John Ruskin. The quality of spices is evaluated by the following three types of techniques:
1. Physical or sensory evaluation
2. Proximate physico-chemical composition and determination of chemical constituents
3. Nutritional assessment
In the following table (Table 61) presentation of the five proximate physicochemical compositions of 5 minerals and 5 vitamins in as many as 35 spices is presented. Since most of the spices are used basically in small quantities in both vegetarian and non vegetarian food as “Food Additives”, they contribute directly very little to human nutrition, but, indirectly spices can play a very valuable role in healthy human nutrition by not only helping to increase the appeal and appreciation of the food dishes, but, also in various other ways as agents with nutraceutical and pharmaceutical properties. For instance, Turmeric has been found to have immense pharmaceutical and nutraceutical properties. Most recently, it has been found to be very beneficial during the covid pandemic. Excepting in most restrictive diets, spices are regularly used in most food preparations and they can make a difference which persuades a patient to stay faithful to an otherwise unappealing diet. The analysis confirm that even the highest calorie spice, Poppyseeds, will add no more than 2 or 3 calories per serving in normal usage. This should be good news, in particular, to weight – watchers. Considering the amounts used, the others typically contribute no more than a calorie per serving, and, usually less than that. Having this definitive data at last, nutritionists and all those interested in good nutition may utilize spices to their full potential in making wholesome foods as excitingly delicious as they are good for us.

Quality control comprises the operational activities and techniques used to ensure that products satisfy established quality requirements. While quality assurance concentrates on preventing problems, quality control identifies and corrects defects during manufacturing or service delivery. In textile and apparel production, it covers yarn strength, fabric weight, dyeing accuracy, seam strength, stitch density, garment measurements, fit, finishing and safety compliance. Inspection, testing and feedback mechanisms are used to compare actual performance with specifications and initiate corrective measures. The principal objectives are to ensure conformity with standards, detect problems in raw materials and finished goods, minimize waste and rework, reduce the cost of poor quality and satisfy customers.

Quality Control addresses the standards and management practices required to ensure reliable and effective biofertilizer products. It introduces general quality concepts, quality-control parameters, microbial functions, and properties of microbial products. The chapter then explains quality-management procedures for important biofertilizer groups, including Rhizobium, nonsymbiotic nitrogen fixers, arbuscular mycorrhizal fungi, and phosphate-solubilizing bacteria. Quality-control measures are linked to product performance, consistency, storage, and application suitability. In this chapter, the importance of seafood in terms of their nutrition, and different methods of processing are dealt. Seafood quality and safety terminologies are explained briefly. The quality parameters affected by rigor mortis in raw, iced and cooked fish are given. Phenomenon of gaping described with reference to rigor mortis. Quality dimension of seafood is explained with intrinsic and extrinsic parameters. Various intrinsic factors affecting seafood quality such as f ish species, seasonal changes, parasite infestation and capture conditions are discussed in detail. The next part elucidates the sensory parameters affecting the seafood quality describing the objective and subjective method of quality assessments. Objective method covers both descriptive and discriminative tests. The final part mentions the Codex guidelines available for the conduction of seafood sensory assessment. At the end, the reader gains the knowledge on the basic information about seafood, role of rigor mortis in affecting seafood quality and the sensory quality assessment methods.

Seafood has been traditionally a part of diet in many parts of the world. In some countries like India, it constitutes the main supply of animal protein among coastal population. Seafood is a low-calorie food and easily digestible compared to other protein-rich meat and poultry products and hence, it is a good choice for elderly persons to obtain their daily protein requirements. Seafood has high-quality quality enriched with all the essential amino acids required for human health. It provides about 1/3rd of the average recommended daily allowance (RDA) of protein.

Quality, i.e. the degree of excellence or superiority, is a combination of attributes, properties, or characteristics that each commodity value in of human food. The relative importance of each quality component depends upon the commodity and its intended use (e.g. fresh or processed) and varies among producers, handlers, and consumers. Appearance of quality, firmness and shelf-life are important from the point of view of wholesale and retail marketers. Consumers judge quality of fresh fruits and vegetables on the basis of appearance and firmness, flavour (eating) quality of the product. Consumers are also concerned about the nutritional quality and safety of fresh fruit and vegetables.

Abstract

Determination of quality of wheat is very important because quality requirement of an individual product vary from one another. Flour quality can be defined as the ability of the flour to produce a uniformly good end product. Flour quality factors can be divided into two basic groups: those that are inherent in the wheat as a result of the genetic make up and the changes brought about by growing conditions; secondly those factors that might be altered during the process of converting wheat into flour Wheat flour constituents play an important role in determining the quality of flour. The flour quality for baking could be assessed by measuring the physical, chemical and rheological characteristics.

Wheat (Triticum aestivum L.) is one of the major cereal consumed globally in various form as food. The powder of wheat flour is prepared by grinding of wheat seeds. Soft wheat flour has low gluten content that causes its crumbly texture. However, hard wheat flour has high gluten content of about 12-14% and has elastic toughness due to which it has good shape once its baked. Wheat flour is a basic ingredient in India’s famous flatbreads, and it can also be a key ingredient in addressing major health concerns in India.

Quality management in apparel production requires an integrated approach covering every stage from material sourcing to final inspection. Important areas include fabric inspection, spreading, cutting, in-process monitoring, finishing and evaluation of completed products. The chapter explains the Acceptance Quality Limit system through practical examples and introduces Statistical Process Control for monitoring manufacturing performance. It aims to help students, practitioners and researchers understand the multiple dimensions of apparel quality and apply appropriate inspection systems. Fruits and vegetables are very important food commodities not only in developing country like India but all over the world. India, which is the most densely populated country in Asia continent, is still struggling to achieve self-sufficiency to feed about 135 crores people. For this purpose, fruits and vegetables have got their specific importance to provide a balance and healthy diet to the Indian people. Therefore, the reduction of post-harvest loss of fruit and vegetables is a complementary means for increasing production. It may not be necessary to considerably step up the production of fruits and vegetables with the growing demand if the post-harvest loss is reduced to a great extent. The cost of preventing losses after harvest in general is less than preventing a similar additional amount of fruit and vegetable crop of the same quality

Fruits are important source of Pro-vitamin A and vitamin C. In addition, vegetables also supply fair amount of carbohydrates, protein and energy and add colour, flavour and aroma to human diet. India is one of the largest producers of fruits and vegetables. Fruits and vegetables are an important supplement to the human balanced diet as they provide the essential minerals, vitamins and dietary fibre (roughage) for maintaining the tear and wear of the over body. Fresh fruit and vegetables have a short shelf life under ambient conditions of temperature and humidity due to their highly perishable nature. They soon lose their freshness and become subjected to mould and bacterial attack, and consequently decay and become useless as articles of human diet. Fresh fruits and vegetables are valued for their quick sources of available energy. Fresh fruits have high water content (70-96%), varying amount of carbohydrate (3-27%) and fibre (0.2-3.1%) and a low content of protein, fat and minerals. Ideal climatic conditions ensure round the year availability of broad range of fruit and vegetables in large quantities. This point of origin may be an above ground plant part i.e. shoot eg. apple, tomato etc. or an underground plant part eg potato, carrot, etc. or in water i.e. harvesting of fish from a pond (not to be covered in this book).

Abstract

India has become not only self sufficient in food grains but has also emerged as net exporter of wheat and rice. Acute famines in India have practically been eliminated, thanks to increased food availability at the national level, improved early warning systems and expanding infrastructure for more rapid transport of food grains and other products to needy areas. However, the existing post management system, strategies and policies don’t seem to match new challenges. Despite government intervention in pricing and procurement of food grains, primarily wheat and paddy, India continues to suffer heavily on account of losses and wastages incurred during the post harvest stages, which are more manmade than natural. Some losses have already occurred before the arrival of food grains in the regulated and wholesale markets and continue till food grains reach their destination. What contribute to continuing losses and wastages are improper post harvest handling, government policies and their implementation, which even stifle growth and modernisation of grain markets and processors.

Introduction

Food grains have been the key component of the human diet for thousands of years and have played a vital role in framing human civilization. Rice, wheat, and maize, and to a lesser extent, coarse grains are major staples, crucial to the daily endurance of billions of people around the world. Cereal grains are consumed by more than 50% of world population to meet daily calorie requirements. Most grains undergo a milling process that ideally removes the outer bran (pericarp) and germ layers; catering to consumer market requirements. To a farmer, yield is the most prominent aspect. As the grain moves along the supply chain, and as the product reaches the market, quality becomes the key determinant of its sale-ability and economic value. Grain quality is defined by a range of physical and compositional properties where threshold necessities are set according to end consumer use requirements. Most industries and consumer markets have become habituated over the years to demand grain with specific attributes. Where consumers are close to the source of grain production (e.g. in local markets), their own preferences and the laws of supply and demand control the grain quality. However, where grain is traded over large distances, particularly internationally, consumers almost have no direct influence on quality, requiring regulatory standards to be established and imposed to protect consumer rights. Therefore in the grain supply chain, all points have effects with respect to grain quality.

Quality is an increasingly important factor in the production and marketing of biological products. Consumers are becoming more discerning as their affluence increases, and would be suppliers of products must meet these demands if they are to maintain or increase market share. The term ‘quality’ is one of the most defined terms in use in food industry today. Quality may be defined as ‘The totality of features and characteristics of a product that bear on its ability to satisfy a given need’. The first part, ‘The totality of features and characteristics of a product…..’ concerns objective factors related to the product.  The second part, ‘…… to satisfy a given need’, concerns subjective factors related to user or consumer of goods.

It is also defined as the combination of attributes or characteristics of the products that has significance in determining the degree of acceptability of the product to a user. Industry defines quality as the measure of purity, strength, flavour, colour, size, maturity, workmanship or any other distinctive attribute or characteristics of the product. According to USDA Marketing Workshop Report (1951) quality is the combination of attributes or characteristics of a product that have significance in determining the degree of acceptability of the product to the user . The quality standards of fresh and processed fruit or vegetable products vary with their intended use. For marketing purposes; size, attractiveness, maturity, organoleptic quality and freedom from defects are to be kept in mind. While for processing, physico chemical attributes of raw material such as presence of soluble solids, development of uniform colour, flavour, juiciness, uniform maturity, tenderness in some vegetables etc are taken into consideration. During processing of fruit or vegetables into value added products; colour, flavour and texture etc also become important.

Whatever may be the source of irrigation water viz., river, canal, tank, open well or tube well, some soluble salts are always dissolved in it. The main soluble constituent in water are Ca, Mg, Na and K as cations and chloride, sulphate bicarbonate and carbonate as anions. However ions of other elements such as lithium, silicon, bromine, iodine, copper, cobalt, fluorine, boron, titanium, vanadium, barium, arsenic, antimony, beryllium, chromium, manganese, lead, selenium phosphate and organic matter are also present. Among the soluble constituents, calcium, sodium, sulphate, bicarbonate and boron are important in determining the quality of irrigation water and its suitability for irrigation purposes. However other factors such as soil texture, permeability, drainage, type of crop etc., are equally important in determining the suitability of irrigation water.

The following are the most common problems that result from using poor quality water.

It is necessary to ascertain the quality of irrigation water so as to gauge the possible effects of this water on the soil. The irrigation water often results in water logging, salinity and alkalinity problems. It is therefore very important to know its quality. Following are the basic criteria or characteristics on which irrigation water quality is judged.

2. Proportion of carbonates and bicarbonates in relation to calcium and magnesium in irrigation water.
3. Proportion of sodium in relation to other cations in irrigation water.

Further the quality of water should be judged by considering the crop and soil factors. Any judgment without considering the above factors may not be useful.
