There is need to find better ways and solutions to mitigate future agricultural challenges toward increasing productivity across the crops and equip them with the desirable genes for resistance to biotic and abiotic stresses and to mitigate the impact of climate change and also to make them nutritionally superior. Here comes “Plant Genomics”—a newly evolved discipline of plant sciences—targeting to decode, characterize, and study the genetic composition, structures, organizations, functions, and interactions/networks of all plant genes in a genome-wide scale. Being evolved from plant molecular genetics, biology, and biotechnology, plant genomics represents the key sub- divisions of structural, functional, comparative, evolutionary, physiological, and genetical genomics. Its development and advances, however, are tightly interconnected with plant science sub-disciplines, such as proteomics, metabolomics, epigenomics, phenomics, metagenomics, transgenomics, breeding-assisted genomics, bioinformatics and system biology as well as modern instrumentation and robotics sciences.

Plant genomics is a recent convergence of many sciences. Simply stated “Genomics” is the new science that deals with the discovery and noting of all the sequences in the entire genome of a particular organism. The genome can be defined as the complete set of genes inside a cell. Genomics, is, therefore, the study of the genetic make-up of organisms. Determining the genomic sequence, however, is only the beginning of genomics. Once this is done, the genomic sequence is used to study the function of the numerous genes (functional genomics), to compare the genes in one organism with those of another (comparative genomics), or to generate the 3-D structure of one or more proteins from each protein family, thus offering clues to their function (structural genomics). In crop agriculture, the main purpose of the application of genomics is to gain a better understanding of the whole genome of plants. Agronomically important genes may be identified and targeted to produce more nutritious and safe food while at the same time preserving the environment. Genomics is an entry point for looking at the other ‘omics’ sciences. The information in the genes of an organism, its genotype, is largely responsible for the final physical makeup of the organism, referred to as the “phenotype”. However, the environment also has some influence on the phenotype. DNA in the genome is only one aspect of the complex mechanism that keeps an organism running – so decoding the DNA is one step towards understanding the process. However, by itself, it does not specify everything that happens within the organism. The basic flow of genetic information in a cell is as follows. The DNA is transcribed or copied into a form known as “RNA”. The complete set of RNA (also known as its transcriptome) is subject to some editing (cutting and pasting) to become messenger-RNA, which carries information to the ribosome, the protein factory of the cell, which then translates the message into protein.

Abstract

Mungbean [Vigna radiata (L.) Wilczek] is an important pulse crop grown in India. It is a short duration annual with yellow flowers and fuzzy brown pods. Majority of the mungbean grown in India is under rainfed conditions and the productivity of mungbean is not upto the mark to meet the daily dietary requirement of a populous country like India. The biotic and abiotic stresses in mungbean, majorly MYMV, powdery mildew, drought, salinity, water logging etc leaves a severe yield loss in mungbean crop. Among them, MYMV and powdery mildew diseases show yield losses accounting upto 85% and 40%, respectively in severe conditions. The present review paper is based on the study of both biotic and abiotic stresses and the recent advances in breeding for resistance to stresses. A detail explanation of major diseases and insect pests affecting mungbean are discussed along with the information of genomic resources and research done in mungbean in recent years. Recently SSR’s have been using widely for all molecular level research work like genetic diversity, constructing linkage maps for identifying QTL’s, marker assisted breeding etc. in mungbean. The resistant varieties developed against these biotic and abiotic stresses are listed which are very important for attaining a prominent yield in mungbean.

Introduction

Cooking accounts for a major share of energy consumption in developing countries. Fifty per cent of the total energy consumed in India is for cooking (Fritz 1981). Most of the cooking energy requirement is met by non-commercial fuels such as firewood (75%), agricultural waste and cow dung cake (25%) in rural areas. The fuel wood requirement is 0.4 tons per person per year in India. In rural areas firewood crisis is far graver than that caused by a rise in oil prices. Marginal villagers have to forage 8 to 10 hours a day in search of firewood as compared to 1 to 2 hours ten years ago. One third of India’s fertilizer consumption can be met if cow dung is not burnt for cooking and instead is used as manure. The cutting of firewood causes deforestation that leads to desertification. Fortunately, India is blessed with abundant solar radiation (IMD, 1985). The arid parts of India receive maximum radiation i.e. 7600-8000 MJ m^-2 per annum, followed by semi-arid parts, 7200-7600 MJm^-2, per annum and least on hilly areas where solar radiation is still appreciable i.e. 6000 MJm^-2 per annum. Therefore, solar cookers seem to be a good substitute for cooking with firewood.

Principle of cooking

The different methods of cooking of food are boiling, frying, roasting, and baking. For boiling of rice, lentils etc. the temperature of food being cooked is about 100° C while for other methods, high temperatures are required. Heat is supplied at the bottom of the vessel for frying and boiling purposes in conventional cooking. Roasting and baking is generally performed on open fire or in ovens, wherein food is surrounded by hot surfaces and heat is transferred to the food by radiation and convection.

Pants that tend to climb vertically on to supports are called climbers. reepers are plants that tend to creep or ramble over the ground or other surfaces spreading horizontally. These have showy flowers or decorative foliage. Climbers are conventionally used in gardens to cover fences, bare walls and tree trunks. They are used to provide ornamentation in a vertical aspect. Creepers on the other hand are used as ground covers and function as decorative elements in a horizontal aspect.

CLASSIFICATION OF CLIMBERS AND CREEPERS

Depending upon their habit, vigour, duration, nature of flowering, adaptations for climbing and shade tolerance, they can be classified as follows:

These are a broad group of plants that have evolved in situations characterized by very high day temperatures and low night temperatures with very low available moisture in the growing medium. Their plant body is modified to conserve moisture with physiological adaptations that help to reduce moisture loss considerably and to survive in hot desert situations or drought conditions. Stems, leaves and roots of these plants are fleshy and rich in watery mucus. The unusual morphological features that these plants have developed to enable them to survive in their harsh native habitats, set them apart from other plants and have given them rarity value when grown as ornamentals. They are hence displayed individually or grown in a rockery where a landscape of rocks and stones highlight their features and at the same time provide desirable contrast with other garden plants. Many members of Cactaceae, Crassulaceae, Aizoaceae, Euphorbiaceae, Asphodelaceae and Agavaceae belong to this group and are commonly referred to as rock garden plants.

The modern or climate controlled greenhouse requires massive inputs of energy and cost of claddings to grow crops out of season making them high cost structures. However, growing of certain horticulture crops and their nurseries out of season is happening in a sustainable way, using the heat from the sun and soil too. These are called passive solar greenhouses designed to retain as much warmth as possible. This concept has revolutionized vegetable production in Ladakh, high altitudes and other parts of the country in winter months.

The solar greenhouse is especially successful in China and are contributing mainly in vegetable production. Solar passive greenhouses are designed in different shape size using different local and other materials keeping in view the local climate and terrain. The poly houses mentioned earlier such as, low cost polyhoses, Ladakhi poly house, solar trench, polyench are passive solar green houses. Being the opposite of the climate controlled greenhouse, the passive solar greenhouse is heated all-year round with solar energy alone, even when the outdoor temperature drops below freezing point. The indoor temperature of the structure can be higher than the outdoor temperature. The temperature can be around 25°C (45°F).

Such greenhouses have been experimented by Defence Research and Development Organization through its establishment FRL (Field Research Laboratory) now DIHAR (Defence Institute of High Altitude Research), Leh/ Ladakh since 1962 during November to the end of March, the period during which the outside temperature drops there below freezing. The average temperature in the coldest month is between -15°C and -18°C. Over the several decades of research different and effective designs of such greenhouses have been standardized which are suitable to produce fresh vegetables like most of the leafy vegetables, tomato, cole crops and potato at sub zero temperature.

16.1 Entering Biological Data into Computer

After the forms have been designed, the database in ready for entry of biological data. Biological data is entered one record at a time. To enter the biological data, the user issues a command, which calls up and displays the appropriate form with blank fields. The user then keys in the data for each field in the appropriate spaces. In this manner, the user enters the data for the first record, then for the second record, and so on. In most database systems, the records are automatically assigned a number as they are entered.

16.2 Saving Biological Data into Computer

While entering data into the fields, the tab key or enter key is usually used to move to the next field. Pressing enter or tab key in the last field on the form saves the record in the database and moves to a new, blank form for the next record to be entered. In addition to using the tab or enter key to move forward through fields, one can directly go to any field on the form at any time by clicking on it with the mouse.

Methods of Weed Control

Prevention, eradication and control are the fundamental principles of weed control.First basic step is to prevent the infestation of a weed(s) in a locality in order to avoid their further spread. If one fails in preventing spread of weeds, eradication step must be adopted. Eradication is limited on a very small scale and adopted only when suitable methods of complete weed removal are available as eradication is cent per cent control of weeds alongwith its root system and other propagative parts. Further, if one fails in prevention and eradication techniques then different weed control methods must be strictly followed in which the objective is to bring down the weed population (with any method) to a level that economical crop yields are possible. The aim of each weed control method is to achieve reasonable good control of weeds. Following methods for controlling weeds are very common:

Try to prevent spread of weed seeds/vegetative parts with the adoption of following preventive techniques.

Mode of Action

The term mode of action refers to the sequence of events from absorption into plants to plant death. The mode of action of the herbicide influences how the herbicide is applied. For example, contact herbicides that disrupt cell membranes, such as acifluorfen (Blazer) or paraquat (Gramoxone Extra), need to be applied post emergence to leaf tissue in order to be effective. Seedling growth inhibitors, such as trifluralin (Treflan) and alachlor (Lasso), need to be applied to the soil to effectively control newly germinated seedlings.

To be effective, herbicides must 1) adequately contact plants; 2) be absorbed by plants; 3) move within the plants to the site of action, without being deactivated; and 4) reach toxic levels at the site of action. The application method used, whether pre-plant incorporated, pre-emergence, or postemergence, determines whether the herbicide will contact germinating seedlings, roots, shoots, or leaves of plants.

Mode of Action of Herbicides

Herbicides perform a vital role in the management of weeds. As the name indicates, herbicides are chemicals that kill or control vegetation. Although the ultimate effect of most herbicides is the same (usually death of weed), the way they control weeds is vastly different. Physiologists use the term mode of action to describe the way the herbicides affect weeds. It includes the entire sequence of events that occur from the time the weed absorbs the herbicide to the final plant response (usually death). The term mode of action is the broad term under which all aspects of herbicidal action including the mechanism of action is included, while the mechanism of action refers to only the biochemical and biophysical responses of plants that appeared to be associated with herbicidal action.

Thus, mode of action includes absorption, translocation to an active site, inhibition of a specific biochemical reaction, degradation or breakdown of the herbicide in the plant and soil and the effect of the herbicide on plant growth and physiology.

Although two herbicides may differ chemically, they may still possess the same mode of action example trifluralin (a dinitroaniles herbicide) and propanamide (an amide herbicide) are inhibitors of microtubule/spindle apparatus. Each herbicide family (class or group) has a primary site of action which may be different in its action from others example sulfonylureas herbicides are ALS or AHAS inhibitors while glyphosate and sulfosate are ESPS inhibitors. Some may have more than one site of action, but the mostinhibitory of these will be affected first. The other site(s) may be considered secondary. Fluometuron, a urea group herbicides act by inhibiting photosynthesis at photosystem II and carotenoid biosynthesis.

1.1 INTRODUCTION

Horticulture is defined as “The science and art of growing vegetables, fruits, flowers, ornamental plants and landscaping of gardens and surroundings in small and commercial gardens”. The word ‘horticulture’ has been derived from Latin language and consists of two parts, viz., ‘hortus’ means garden and ‘cultura’ means cultivation. Thus, the word ‘horticulture’ means garden cultivation. Horticulture basically deals with Pomology, Olericulture, and Floriculture and Landscaping. Horticulture is gaining importance as it gives more returns per unit area and also gives nutritious food to human beings thereby improves quality of life and enhances the aesthetic beauty of nature. Vegetable growing is one of the major branches of horticulture with respect to value of the products.

In technical sense all parts of vegetables are used for consumption. The term, however, is usually applied to the edible plants which store up reserve food in roots, tubers, bulbs, stems, petioles, leaves, buds, flowers, fruits, and seeds which are eaten either cooked or raw. Growing vegetables is not only important for providing the protective food but also serve as an important subsidiary food playing a more significant role in the food consumption. They are rich in nutrients and are essential components of a balanced diet.

Status of Women

As per 2011 Census, women account for 586.46 million, and represent 48.5% of India’s total population. However, from global perspectives, they constitute half of global population, and 1/3^rd labour force, but receive only 1/10^th of world income, and own less than 1% of world’s property. Further from national point of view as Reddy et al. (1994) in his study opined that “although women constitute 50 percent of India’s population, perform two-thirds of the work and produce 50 percent of food commodities consumed by the country and they earn only one-third of the remuneration and 10 percent of the property or wealth of the country.

The vast majority of working women are uneducated cultivators and agricultural labourers residing in villages. Most of the women, working on the family farm are unpaid labourers. 63 percent of all educated women with at least a high school certificate are unemployed, and of the 37 percent who are employed 15 percent are clerks, 5 percent teachers, 7 percent nurses and 10 percent are other professionals. Only 6 percent of Government employees are women (Jain, A.K. 2004). Rural Women form the most important productive work force in the economy of majority of the developing nations including India. Agriculture, the single largest production endeavour in India, contributing about 18% of GDP, is increasingly becoming a female activity. Agriculture sector employs 4/5th of all economically active women in the country. 48% of India’s self-employed farmers are women. There are 75 million women engaged in dairying as against 15 million men and 20 million in animal husbandry as compared to 1.5 million men.

Despite progress in several key indicators, a gender analysis demonstrates that women continue to be relatively disadvantaged in matters of survival, health, nutrition, literacy and productivity. Further, more than 90 percent of rural women are unskilled, restricting them to low paid occupations. Women generally have no control over land and other productive assets which largely exclude them from access to institutional credit. Further, agricultural wages for women, on an average 30-50 percent less than those for men. Though they work for longer hours under inhospitable conditions, their participation in decision making process is less than desirable.

Swarnjayanti Gram Swarozgar Yojana (SGSY)

The Swarnjayanti Gram Swarozgar Yojana (SGSY), a programme for the self employment of rural poor was started from 01.04.1999 after restructuring the six erstwhile Integrated Rural Development Programme (IRDP) and its allied programmes, These were : IRDP, Training of Rural Youth for Self Employment (TRYSEM), Development of Women and Children in Rural Areas (DWCRA), Supply of Toolkits in Rural Areas (SITRA) and Ganga Kalyan Yojana (GKY), and Million Wells Scheme (MWS). The basic objective of the SGSY was to bring the assisted poor families (Swarozgaris) above the Poverty Line by providing them income-generating assets through a mix of bank credit and governmental subsidy. The programme aimed at establishing a large number of micro enterprises in rural areas based on the ability of the poor and potential of each area.

Livestock Development Programmes/Schemes

Gausalas

Recognizing the potential of Gaushalas (about 10000) in the country which were engaged in rehabilitation of disowned cattle, the government of India in 1952 set up the Central Council of Govsamvardana (CCG). Some of these gaushalas were providing quality indigenous / crossbreds / heifers / bulls at many places like Nasik, UrliKanchan, Amirtsar, Indore and Ahmednagar. One gaushala at Bombay had completed a century of devoted work in 1986 and had established two institutes, one for research and another for fodder research and grassland development. The Sabarmathi Ashram gaushala founded in 1915 by Mahatma Gandhi near Ahmedabad is now being managed by NDDB and has a training center for AI service including embryo transfer.

Introduction

Advances in food preservation methods have supported the journey of food science from that of a cookery science to a fast growing industrial technology. Food preservation knowledge deals with the way to prevent spoilage and maintenance of quality in foods. Spoilage is the deterioration in quality brought about by inherent biochemical and chemical changes, as well as microbial metabolism during food storage. Basic principles of food preservation (Frazier et al., 2008) remains the same, but newer methods for achieving the goal is added through research fuelled by a consumer demand for fresh-like foods with convenience and safety. Scientific information on novel processing methods are beautifully compiled (Cullen et al., 2011; Da-Wen Sun, 2014; Tokuþoðlu and Swanson 2015; Doona, 2018).

In-depth knowledge of physiological activities of micro-organisms in presence of preservation agents is essential for preparation of safe foods with prolonged shelf life. Besides this, it is necessary to understand the effect of food constituents on microbial resistance against inactivation agents, to identify critical dose requirement. This profound knowledge would also help to understand kinetics of microbial inactivation and to develop mathematical models suitable for a realistic design of process parameters. For better appreciation of the following sections, readers are encouraged to have fundamental knowledge in microbiology and food processing. The sections in this chapter cover advanced microbiological knowledge pertaining to the preservation aspects of food.

Nano-technology refers to technology on a nano- meter scale, specifically less than 100 nano-meters. The novel nano-particles are tiny spheres (fullerenes) or tubes (nanotubes) made from carbon atoms. It facilitates the development of future inventions transversely a vast array of fields. New nano-particles are being made of silicon, ceramic, polymers or even natural ingredients that break down in the body. The characteristics that make these particles functional in the food industry include optical properties, reactivity to temperature, and biodegradability. They can be used as probes or filled with flavorings or nutrients for delivery. Highlights on the categorisation of agriculture with nano- food technology and nutrition are given in Fig 1.

There are three key elements in nano-technology. They are: (1) substances at nano-scale exhibit novel physical and chemical phenomena with novel functions (2) allowing to measure, control and operate material at the nano-scale that transform them to functions. (3) allowing the union of nano scales of materials for exceptional properties.

Drying of the Spices

Drying is an important mode of preservation and it ensures microbial safety of the spices.The main purpose of drying is to increase the shelf storage and make the seasonal spices available round the year with minute losses of nutrients, flavor, taste and color (Maroulis, 2003). During drying, there is a continuous transfer of heat and mass due to the heat application which eventually leads to moisture removal from the product (Akpinar, 2006) (Hashim, 2014). Since, the sensory, nutritional and functional attributes of spices are partially or totally affected by the drying process, the adequate choice of drying technique becomes requisite. There exists a number of conventional drying methods including solar drying (El-sebaii, 2012), freeze drying (Ciurzy nska 2011), vacuum drying (Nadi, 2012), osmotic dehydration,hot air drying and fluidized bed drying (Onwude, 2016). However, these drying techniques lead to poor quality of the spices because of the longer duration of treatment and high amount of energy. To combat with the issues of poor quality, there has been a significant development of the novel techniques, which includes- microwave, ohmic, infrared, pulse electric field, radio- frequency, ultraviolet, ultrasound, supercritical and heat pump heating, in the drying of the agricultural crops. These novel techniques are found to produce higher quality products as compared to the conventional drying techniques (Moses J. N., 2014). The microwave and radio frequency heating technologies are developed in such a manner that they are capable of partial or complete removal of the conventional methods of heating/ drying (Onwude, 2016). The use of these novel techniques has gained a keen attention for the drying purpose of spices. Some of the researchers have also proved that combination of conventional and novel drying techniques leads to better product output.

Abstract

Microbes are ubiquitously found in the environment. Their interaction with other living organisms could either be pathogenic or beneficial in nature. Soil as a rich source of microbes, researchers have extensively studied the plant-microbe interactions. The soil microbes supply the nutrients deficit plants with essential growth elements such as nitrogen, phosphorous, potassium, etc. and improve the texture and quality of the soil. Due to the destructive nature of chemical fertilizers to soil and environment, it was required to generate a more ecofriendly means of increasing the soil fertility. This led to the development of microbes based biofertilizers. The primary benefit of biofertilizers is to promote a healthy soil environment along with supplying essential nutrients to the plant. Again, biofertilizers can be tailor-made according to the specific plant or the climatic conditions. Fungal and bacteria based biofertilizers, either alone or in combinations are formulated for the plants. Lately, liquid fertilizers are increasingly finding their use in the biofertilizer industry due to their ease in manufacture and prolonged effect on plant growth. The scope of this chapter lays on the currently popular biofertilizers and recent trends in the biofertilizer industry.

Abstract

Soil salinity is one of the major environmental stresses affecting crop productivity and soil health drastically, particularly in arid and semi-arid areas. Most of the vegetable crops being salt sensitive, grow poorly in saline and alkaline soils. Soil salinity affects crops mainly due to the osmotic stress and excessive accumulation of toxic ions (Na⁺, Cl^-, and SO₄ ^2-), whereas alkali soils are generally characterized by poor physical conditions due to high concentrations of bicarbonate (HCO₃ ^-) and carbonate (CO₃ ^2-) as well as high exchangeable Na⁺. Excessive concentrations of sodium chloride (NaCl) in soil or irrigation water can induce several morphological, physiological, and biochemical responses in plants leading to stunted growth and yield. This is due to osmotic (i.e., water deficit) and ionic (i.e., Na⁺ and Cl^-) effects on nutrient uptake/translocation and metabolic processes such as nitrogen assimilation, photosynthesis, and protein synthesis. Plant growth promoting microbes (PGPMs) are considered as promising tools to overcome the limitations of salinity on crop growth and productivity. Many PGPMs can enhance tolerance of crops to salt stress by increasing nutrient uptake through better solubilization of nutrients like phosphorus and zinc, and also by production of small peptides, volatiles and metabolites with hormone activities such as indole-3-acetic acid or auxin analogs in the rhizosphere. This chapter discusses the benefits of PGPMs in plant adaptations to salt stress conditions.

Abstract

Potassium (K) is the third most essential macronutrient element for plants. More than 98% of K in agricultural soils are remained as insoluble organic and inorganic compounds or complexes that are unavailable for plant uptake. Nutrition of crop plants are heavily relied on application of expensive inorganic chemical fertilizers, which is a potential cause of environmental pollution. An eco-friendly alternative strategy for plant K nutrition could be the application of K solubilizing bacteria (KSB) as biofertilizer. Plant and soil-associated bacteria from diverse taxonomic genera such as Bacillus, Pseudomonas, Acidithiobacillus, Paenibacillus, Flectobacillus, Arthrobacter, Enterobacter, Sphingomonas, Paraburkholderia etc. have shown high K solubilizing activities and promote plant nutrition in K deficient soils. The mechanisms involved in their activities include acidolysis, chelation, exchange reactions, and enzymatic degradation of insoluble K minerals and other K complexes. However, inconsistency in the efficiency of KSB-based biofertilizer for crop production in diverse ecological settings is still a big challenge. Recent genomics, post-genomics and CRISPR-Cas genome editing approaches seem to be useful for a better understanding the underlying mechanisms of KSB and development of highly efficient K fertilizers for promoting sustainable agriculture. This chapter comprehensively reviews current updates of KSB-based biofertilizer and their potentials for promoting sustainable crop production. The role of genomics and post-genomics approaches for better understanding of the mechanisms of the functions of applied KSB-based biofertilizers in the crop field and mitigation of the existing inconsistency in the efficiency of KSB-based fertilizers are also discussed.

The raw material of foremost importance in bakery product is the wheat flour. Bakery units prefer the flour obtained by milling in roller flourmill with 70– 72 percent extraction. Flour quality may be defined as the ability of the flour to produce an attractive end product at competitive cost, under conditions imposed by the end product manufacturing unit. The concept of quality differs from producer and consumer point of view. However, in general, the term quality may refer to fitness of a raw material or a product for a particular process or consumer. For a consumer, the following parameters are important criteria of a product quality.

The indigenous ornamental fish which are very popular overseas, are being harvested from the wild and exported. This in the long run, may lead to depletion of stock due to over harvesting of our valued native fish species. Hence, breeding of native fish species is also equally important for a sustainable trade of ornamental fishery and to conserve the natural stock. Some fishes breed naturally with ease, whereas others are bred by artificial techniques like hand stripping and hypophysation. In nature, the fishes are stimulated by changes in environmental factors. These conditions can be simulated to some extent in the aquaria by providing specific biological requirements for spawning.

I. Breeding of Zebra danio (Brachydanio rerio)

Brachydanio rerio is commonly known as zebra danio. The zebra danio, as the name implies, is characterized by a number of bright blue or purple horizontal lines, which run from the head to the caudal fin. This pattern is repeated in the anal and caudal fins too. The flanks have prussian blue colouration and operculum has golden blotches. The dorsal fin of this species has an olive yellow base and there are blue gold markings on the anal fin.

Introduction

Expanding human and livestock population, fast-growing industrial requirements and urbanization are putting ever-increasing pressures on land resources, creating competition and conflicts which results in sub-optimal use of both land and its natural resources. With no additional land for horizontal expansion of agriculture, there is an urgent need to find viable technologies for enhancing productivity and resource conservation on a sustainable basis. In this context, Agroforestry offers huge potential not only to diversify and increase overall land productivity to meet the demands of fuel, fodder, timber, medicine and other non-woody forest products but also to enhance green cover, and reduce the pressure on forest (Chavan et al. 2016; Handa et al., 2016). Agroforestry offers an affordable alternative in place of expensive conventional conservation measures for providing insurance against risks caused due to weather aberrations, controlling erosion hazards and ensuring sustainable production of the land on a long-term basis. The main objective of agroforestry is to take the advantage of complementary relationships between trees, crops, and livestock in such a way so that sustainability, productivity stability, and profitability of the system is maintained. In India, agroforestry practices are important component in the various developmental programmes schemes like Flood Control/Management Programmes, Multipurpose River Valley Projects, Agriculture Development Programmes, Integrated Rural Development Programmes (IRDP), National Watershed Development Programme for Rainfed Areas (NWDPRA), Forestry Development Scheme, Drought Prone Area Development Programme (DPAP) and Desert Development Programme (DDP) from government sector and wood based industry from private sector. After 2000 a transitional shift in agroforestry observed to tackle the ill effects of intensive agriculture, climate change and nutritional security. Under changing climatic scenarios agroforestry rose as a silver bullet to offer not only single benefits but also a basket of multiple benefits. In the present chapter a journey of agroforestry research and developments, region-specific models, area under agroforestry, initiative of government on policy aspects and challenges are elaborated extensively.

Growing foliage and flowering potted plants in the home is a great way to develop an intimacy with the nature. Caring and attending the plants gives us immense pleasure and satisfaction, especially retiring after day long working schedule. Now a days, wide variety of houseplants are available that can accommodate almost any indoor location in terms of available space, light and management factors. Research carried at National Aeronautical Space Agency (NASA) has shown that having plants in the home or office, especially in a closed air-conditioned environment, can be good for your health and well-being.

Our indoor environment

It is surprising to know that our comfort zone environment may have 2-5 times the pollution levels than outside air. Although, the magnitude may vary and could potentially reach 100 times depending upon the size of building, occupants, provision of ventilation, volatile organic compounds (VOC’s) emitted from upholstery and paints. The quality of outside air also determine the indoor air quality that may get mixed-up resulting in elevating the levels of carbon-dioxide (CO₂) and other harmful gases beyond the permissible limit. It has been revealed that the indoor CO₂ levels are substantially higher (3-5 times) than those recorded outdoor. The CO₂ being a narcotic cause drowsiness and loss of concentration leading to decline in performance and productivity of employed staff. This sudden upsurge in CO₂ and other toxic gases evolved from the volatile compounds from paints likely raise the Air Quality Index (AQI) that affects the health and working efficiency of building occupants.

It has been scientifically proved that the equipments installed for ventilating closed environment of residential or commercial buildings are not efficient in removing gases and thereby, to some extent filter only the particulate matter (PM). As per the prescribed standards of World Health Organization (WHO) and American society of heating, refrigeration and air conditioning engineers, the maximum permissible limit for indoor CO₂ is 1000 ppm. The term “Sick Building Syndrome” (SBS) is a very common disorder associated now a dayswith the people working in closed environments, especially that lack ventilation. When the CO₂ levels reach 1500 ppm, symptoms such as sore throat, nasal flow and cough are quite commonly observed among the people, thus affecting their general health and well being. Poor indoor air quality has been a major factor linked to SBS, reducing productivity of employees and also cause impaired learning in children in schools.

Temperature is the physical property of an object that quantitatively expresses the hotness or coldness. Most of the weather parameters are dependent on temperature, directly or indirectly. It has important role to play in the development and growth of all living organisms in all stages of their growth. Atmosphere receives the heat energy from the sun and its temperature increases. Due to different amount of heat energy receipt at different places, the air temperatures at different places also vary. The variation in air temperature basically results into air motion, so as to equalize the energy content of the different regions of the earth. Thus, atmospheric temperature is one of the basic elements of weather and climate.

The temperature at a given location and time is affected by energy transfer processes including conduction, convection, advection and radiation. The controls of temperature include those factors that bring about spatial variations in temperature. The important factors that determine the temperature of a particular place on the earth’s surface are latitude, altitude, distribution of land and water, topography, ocean currents, prevailing wind, cloudiness, precipitation, nature of the surface, and turbulence.

An agrometeorological observatory or station is a place where all the necessary instruments and structures are installed and maintained to observe and record the weather parameters at stipulated time interval.

5.1 Population Growth

In 2000, the world had 6.1 billion human inhabitants. This figure may rise to more than 9 billion in the next 50 years. For the last 50 years, world population multiplied more rapidly than ever before, and more rapidly than it will ever grow in the future. Anthropologists believe the human species dates back at least 3 million years. For most of our history, these distant ancestors lived a precarious existence as hunters and gatherers. This way of life kept their total numbers small, probably less than 10 million. However, as agriculture was introduced, communities evolved that could support more people.

World population expanded to about 300 million by A.D. 1 and continued to grow at a moderate rate. But after the start of the Industrial Revolution in the 18th century, living standards rose and widespread famines and epidemics diminished in some regions. Population growth accelerated. The population climbed to about 760 million in 1750 and reached 1 billion around 1800.

In 1800, the vast majority of the world’s population (86 percent) resided in Asia and Europe, with 65 percent in Asia alone. By 1900, Europe’s share of world population had risen to 25 percent, fueled by the population increase that accompanied the Industrial Revolution. Some of this growth spilled over to the Americas, increasing their share of the world total. The 2000 growth rate of 1.4 percent, when applied to the world’s 6.1 billion population, yields an annual increase of about 85 million people. Because of the large and increasing population size, the number of people added to the global population will remain high for several decades, even as growth rates continue to decline.

Between 2000 and 2030, nearly 100 percent of this annual growth will occur in the less developed countries in Africa, Asia, and Latin America, whose population growth rates are much higher than those in more developed countries.

Introduction

Ammonia has been described as one of the most significant limiting factors for the growth and survival of aquatic living resources among water quality criteria (Russo and Thurston, 1991). Ammonia is a common pollutant of water bodies and forms the main nitrogenous waste in fishes (Tomasso et al, 1980). It enters the river and stream directly from livestock wastes and indirectly via poorly treated waste-water discharge. The chemistry of ammonia in freshwater has been extensively reviewed and its toxicity to the fish is generally expressed as ammonia concentration (EIFAC, 1970; WHO, 1986). Ammonia is produced mainly in the fish liver (Goldstein et al, 1982), it reaches the gills through the blood (Evans and More, 1988), excreted through the epithelium (Evans and Cameron, 1986) and finally released into the water body. The accumulation of nitrogen may induce alternations in branchial tissue and causes fish mortality (Peters et al, 1984; Woker and Wuhrmann, 1950).

Ammonia is a weak base, in the acidic range almost all the ammonia gets converted to ammonium ion (NH₄ ⁺) but only a fraction of ammonia forms such ion at alkaline pH. However, in physiological ranges (pH: 7 to 8) about 2.5% of ammonia exists in a unionized form (Paley et al, 1993). The toxicity of ammonia in water is mainly the result of its unionized form (Richardson, 1997). The unionized ammonia accounts for the major part of metabolic ammonia excretion by diffusion down its concentration gradient (Cameron and Heisler, 1983). The unionized ammonia determines the toxicity level in the water and brings about great problems in pisciculture by causing various diseases (Burrows, 1964; Smart, 1976) and alternations in normal physiology (Cairns et al, 1975; Sarkar and Pramanik, 1986). The ratio of unionized ammonia to the total ammonia mainly depends on the pH and temperature of the freshwater. The concentration of unionized ammonia increases with increasing pH and temperature (Emerson et al, 1975). A rise in temperature and pH from 20⁰C to 25°C and 7.5 to 8.5 respectively gives the fifteen-fold increase in the amount of unionized ammonia.

Maturity Standards and Harvesting Indices

Harvesting : Harvesting is detaching a commodity from the point of its origin. This point of origin may be an above ground plant part i.e. shoot eg. apple, tomato etc. or an underground plant part eg potato, carrot, etc. or in water i.e. harvesting of fish from a pond (not to be covered in this book).

The branch of statistics which describes the data is called descriptive statistics. After collection, the data are presented in form of tables, diagrams or graphs. This facilitates the further analysis of data. The most basic form of data analysis is descriptive analysis of data collected and presented for the study. The descriptive statistics summarises the data and helps to find the representative value of the entire data set and the variation of the other values in the data set around the representative value. The descriptive statistics includes the measures of central tendency or averages, measures of dispersion or scatteredness, measures of skewness and the measures of kurtosis. Before going to discuss the R codes for various measures of descriptive analysis, we would first discuss in brief about these measure. This will help in better understanding of the R codes.

Measures of central tendency or averages: They are the representative values of the data series. They give an idea about the concentration of the values in the central part of the distribution of the data. There are five types of averages. They are 1. Arithmetic Mean (A.M.) 2. Geometric mean (G.M.) 3. Harmonic Mean (H.M.) 4. Median 5. Mode.

It has been found that at the household level the health of female members in any family suffers to a large extent. It could be encountered to low health care, poor housing or/and environmental conditions. Due to malnutrition it affects the health to such an extent that it gives rise to many diseases. For a sustainable nutritional status food and various aspects of health needs attention. Looking into that, nutrition is directly related to the health status. For food and nutrition security it is vital to see the availability, accessibility and utilization of food. The World Food Programme (WFP) developed the Vulnerability Analysis and Mapping (VAM) project to analyse the vulnerability to food insecurity of target populations. A prominent part of VAM is related to food access. The demographic and Health Survey (DHS), funded by USAID, provides health data for many countries to help them design their national policy. FAO has developed the Global Information Early Warning System (GIEWS), which collects data related to temporary food insecurity. Under the leadership of WHO, several health surveillance systems have been developed and implemented to monitor the epidemiology of various forms of malnutrition and of selected diseases. At the meso or sub-national level, food market surveys provide data on the availability of food. Agricultural production surveys, intra-household food frequency interviews, immunization surveys and anthropometric surveys of children under five can be used to assess the availability, accessibility and utilization of food and its stability at micro level. Most common Food and Nutrition Security (FNS) indicators at different social and administrative levels depends on the supply and demand. To determine the national situation of food availability data on the production of different food commodities, fertility rate and the trends in internal population needs to be seen. Food prices and per capita food consumption are indicators for national food accessibility. The rates of stunting, wasting and underweight in children, low Body Mass Index (BMI) in adults and low birth weight are FNS impact indicators that designate the extent to which food is adequately being used, utilized and converted into a satisfactory national nutrition situation. Fluctuations and shortages of food availability or accessibility in food prices make the national FNS unstable. Sensitive indicators for accessibility of food are the prices in the market. The sewage disposal and diarrheal diseases (DD) rates affect food utilization.A temporal food and nutrition insecurity arises due to pre and post harvest food availability and accessibility along with low BMI.If the food is in shortage leading to the consumption of more wild foods indicates reduced food availability at household level. Introduction to sustainable disease management

Plants and pathogens are involved in ongoing interactions over millennia that have been modified by coevolutionary processes to limit the spatial extent and temporal duration of disease epidemics (Zhan et al. 2015). These interactions are disrupted by modern agricultural practices, such as intensified monoculture using high yielding varieties. Agricultural intensification and monoculture coupled with globalization disrupt the coevolutionary dynamics of plant-pathogen interactions which escalating the evolutionary rate of pathogens and increasing the risk of plant disease epidemics. These activities, when supplemented with high resource inputs, create unique conditions which is conducive to widespread plant disease epidemics and rapid evolution of pathogen. Disease management requires a significant shift to include ecoevolutionary principles in the design of adaptive disease management strategy for minimizing the evolutionary potential of plant pathogens by reducing their genetic variation, stabilizing their evolutionary dynamics, and preventing dissemination of pathogen variants carrying new infectivity or resistance to pesticides (Zhan et al. 2014). As environmental and ecological issues continue to impact on agriculture, all the crop-specific and regional-specific, Good Agricultural Practices (GAP) to be developed for crop production, must be economically feasible, ecologically sound, environmentally safe and socially acceptable. Numerous non-chemical methods for management of crop diseases such as pathogen-free seeds, disease resistance, crop rotation, plant extracts, organic amendments and biological control agents are considered less harmful than chemical pesticides and therefore, offer great potential for application in modern agriculture (Marshal et al. 2008). No single method can provide satisfactory management of crop diseases. Integration of all the effective and eco-friendly measures in accordance with the dynamics of the agro-ecosystem management would be the best strategy for efficient plant disease management.

Introduction

Fermented meat and fish products have been consumed all over the world since times immemorial and represent one of the most important groups of food. Meat offers its own natural microflora. Hence a wide variety of products have been prepared since ancient times by varying the mixture of meat and salt as well as by the addition of spices and seasonings. Thus, fermented meat products characterize a diversity of flavors and textures and are receiving increased interest from consumers all over the world. Most of these products still depend mainly on local, traditional manufacturing processes since little scientific information is available; but scientific knowledge is very important for consistent production of high quality and safe products.

Meat is an essential part of non-vegetarian diet. It is liked for its unique taste and is a rich source of nutrients like good quality animal proteins, essential amino acids and fatty acids, minerals, trace elements and particularly B-complex vitamins (Singh et al., 2013). The growing concern of consumers regarding health and safety issues has led to the development of functional meat products that promote health and well-being, beyond their nutritional benefits (Grasso, et al., 2014; Tyopponen et al., 2003). This has driven researches in the meat processing sector to increase their efforts in producing such functional meat products, which have incorporated functional ingredients, reduced salt, nitrates/nitrites, cholesterol and fat and modified product fatty acid profiles (Zhang et al., 2010). Okra or lady’s finger (Abelmoschus esculentus L. Moench, 2n = 2x = 130, family, Malvaceae) is classified as fruit vegetable like tomato, and eggplant and is grown in the tropical and sub-tropical regions of world. Okra growing major countries are India (occupying the first rank), Turkey, Iran, Iraq, Egypt, Saudi Arabia, Cameroon, Mexico, Lebanon, Israel, Jordan, Greece, Yugoslavia, Bangladesh, Afghanistan, Pakistan, Myanmar, Japan, Malaysia, Brazil, Nigeria, Ethiopia, Sudan, Ghana, Benin, Cyprus, and southern USA. Though, virtually it is not grown in Europe and north America, yet lot of people in these countries have started liking this common vegetable because of good amount of vitamin A and folic acid, besides, carbohydrates, phosphorous, magnesium, and potassium. In India, okra is extensively grown throughout the country but the states with substantial acreage under okra are Gujarat, Maharashtra, Andhra Pradesh, Telangana, Uttar Pradesh, Madhya Pradesh, West Bengal, Assam, Rajasthan, Tamil Nadu, Karnataka, Haryana and Punjab, both in rainy and spring-summer season. The global total area and production under okra is reported to be close to 1.15 million ha and 7.9 million tons giving a productivity of 6.8 tons/ha. India with approximately 0.5 million ha (5 lakh ha) area and production and productivity of an average of 6 million tons and 12 tons/ha, respectively accounts for close to 75% of share of world production of okra and hence has been accorded a prominent place in the list of crops under R&D by the private seed companies in India. In India, okra has huge export potential as fresh vegetable to the neighbouring countries in the Middle East, like, Bahrain, Qatar, Kuwait, Saudi Arabia, Muscat, Tehran, and Abu Dhabi and SouthEast Asia, particularly Singapore, Mauritius, Malaysia, Sri Lanka and Bangladesh. Therefore, any company with its own R&D in India treats okra a worthwhile crop to keep it under its portfolio and naturally okra becomes an important crop for commercial breeding. Unless a crop makes business sense on account of substantial acreage, production and seed sale volume, there will be no point in launching a full-fledged commercial breeding programme on that particular crop. Thus, okra qualifies a good candidate for commercial breeding in India.

ABSTRACT

Approximately 30 % of fruits and vegetables are getting wasted each year in country like India. Not only that, there is a huge loss of agro based commodity during industrial processing and will be considered as industry generated waste. Utilization of such unexplored nutrients from agro processing sectors for making a sustainable food system will be a healthy approach to bring food security and nutrition to all of us. With this aim the present work addresses the utilization of jackfruit seeds, an agro-waste, to value added products. Jackfruit seed flour has a great potential in new food formulation along with wheat flour. The 15% (w/w) blending of jackfruit seed flour with wheat flour could be used in bread and the substituted bread is protein and fibre enriched. This attempt in developing such bakery items with blended flours could address the scarcity problem of non-wheat producing countries. Present study also looks into the alternate source of starch from spice processing industries. The nutrient starch could be explored for isolation from a nonconventional source from turmeric processing sector. The isolated starch could also be modified to enhance some of its functional properties and may be utilized in preparing value added product with a better acceptability and nutrition.Thus, the isolation of nutrients and value-added products out of fruits and vegetables and spice-processing waste would be a stepping stone to an initiative to zero hunger.

ABSTRACT

Green packaging is a technique used to develop sustainable and eco-friendly packaging materials. In this review paper we have examined the data currently available on the use of plant by-products and plant extract in the development of green packaging. The use of plant fibres is especially beneficial because they often contain a high concentration of bioactive compounds. These compounds lend a preservative effect to the packaging material. Further we have also discussed the degradability of such packaging and the additives which need to be added in order to enhance their utility. Lastly, we have examined the possible applications of green packaging in the food industry.

11.1. What is acid soil?

Acid soils refer to those soils that are characterized with the presence of higher concentration of H⁺ in soil solution and at exchangeable sites or characterized with its high proton donating capacity such as aluminium (Al³⁺) on hydrolysis gives rise to proton. Both H⁺ and Al³⁺ are responsible to contribute soil acidity. Al³⁺ causes soil acidity indirectly by generating H⁺ through its hydrolysis, while H⁺ contributes directly. Therefore, due to more abundance of H⁺, they exhibit low soil pH and low base saturation (Ca²⁺, Mg²⁺, Na⁺ and K⁺). Such soil is considered as problematic soil because plant growth is affected adversely under acidic conditions and they suffer root injuries when grown in acid soils. Besides, soil acidity interferes in the soil nutrients availability to plants, making them either deficient to plants (such as phosphorus, calcium, magnesium, molybdenum) or toxic to plants for their more availability. Under acidic condition, Al, Mn and Fe are found in more soluble form. Thus, they are taken up by the plant in such a higher level that they become toxic to plants. Phosphorus becomes immobile due to the formation of insoluble compounds with aluminium and iron under acidic conditions. Ca, Mg and Mo also become unavailable in acid soil and show their deficiency symptoms. Soil acidity also affects soil microbial growth and thus, in turn, affects the nutrient dynamics in soil. Soil acidification is induced heavily under intensive agricultural practices such as increasing leaching due to more irrigation practices, addition of fertilizers, build-up of soil organic matter and many other possible ways.

Introduction

The green revolution is exemplified by too much adoption of high soil disturbance, modern varieties, energy exhaustive technologies, high amount of capital investment and simplification of farming systems (Meeus, 1993), resulting in uniform and featureless landscapes (Nassauer and Westmacott, 1987) in the most intensively farmed arable areas. In post-green revolution epoch, we had experienced a period of remarkable escalation in food productivity, despite rising land values and increasing land scarcity. Farmers from both developing and developed countries get exposed to several production constraints for achieving a sustainable, cost-effective and assured return from their field. Depending upon the circumstances and the scale of farm activities, farmers face varying degrees of climate risk, biotic invasion, and economic uncertainty. Thus, from the context of economical ambiguities, volatile food prices, social pressure to buffer ups and downs of agricultural production and achieving food security for ever growing population and curtailing poverty, farmers must be equipped with novel cultural practices to achieve a sustainable and assured cost-effective grain production. Research experiments throughout the globe found that the principal indicators for unsustainability of agricultural systems are: (1) intensive tillage induced decrement of soil organic matter (OM), structural degradation of soil, accelerated water and wind erosion, reduced water infiltration rates, surface sealing and crusting, soil compaction, (2) insufficient return of organic materials into soil, and (3) monocropping.

The Post Independence Scenario

It is believed that it takes more time to build and less to demolish, but strangely, in case of Allahabad, it took less time to build but much more to ruin it. As discussed in the last chapter, the peak was reached in about 34 years from 1868 to 1902, the period from 1903 to 1942 being the most constructive years in the history of Allahabad. From the inception of the High Court in 1868 to the formation of the Muir Central College in 1872, to being the capital of the provinces in 1902, Allahabad was regarded as a front runner in the field of Education and Culture.

The city regarded as a ‘production house’, nurtured talent and produced academicians and administrators, who contributed immensely in the process of nation building. The scenario after 1947 however changed drastically, it seemed, as if the city of Allahabad had exhausted its definite role in the freedom struggle, serving only as a preparatory ground which guided young minds to face the future with confidence. Its literary associations, libraries, university and other schools created an intellectual environment which propelled young talents to national fame. The civil services examinations were successfully cleared by many students of the university in those times, this was a result of quality education and an intellectually surcharged environment.

Independent India had lot of promises to fulfill and great expectations from the citizens. Delhi, the capital of Free India, was the focus of these activities. The emergence of new power centers and subsequent development of business and industrial centers, namely, Mumbai, Kolkata, Chennai and later Bangalore, shifted the focus of development from regional, small cities to these new centers. This quantum jump, saw cities of the like Allahabad, Lucknow, Varanasi, trail behind, as they were suddenly reduced in the current perspective and referred to as places in a historical perspective. Post Independence phase created huge opportunity for talented people, academicians, politicians, members of the judiciary, were asked to participate in the running of the nation. Allahabad’s role probably at this point of time, around 1947, seemed to be receding and the city was beginning to be ignored and conveniently forgotten. It slowly became a museum, with only old tales to tell.

This chapter discusses the decline of Allahabad, particularly institutional decline and also traces the earlier efforts in planning of the city. It is here we look for grey areas which would help in finding the exact causes of the physical decline that beset the city.

Pollution is an undesirable change in physical, chemical or biological characteristics of air, water or land caused by excessive accumulation of pollutants (substances causing pollution).

The Green Revolution and subsequent efforts through the application of science and technology for increasing food production in India, have brought self-reliance in food. The imputs given by the Government, State Agricultural Universities, State Departments of Agriculture and other organizations through the evolution and introduction of numerous hybrid varieties of fruits and vegetables and improved management practices have resulted in increased food production. However, the nation still faces the problem of the use of improper methods for the storage of food stuffs and their preservation leading to great wastage of the food produced. So, there is a urgent need for the application of food preservation and processing methods.

Food preservation involves all the processes used to maintain foods with the desired properties or nature for longer time. The process is has moved from an art to a highly interdisciplinary science. Food safety now the first priority of the food production and preservation industry, incorporating innovations and sustainability. The preservation and processing of food however, is not as simple or straight forward as it was in the past. A number of new preservation techniques have been developed to satisfy the current demands of economic preservation and consumer satisfaction in nutritional and sensory aspects, convenience, and safety, absence of chemical preservatives, and environmental safety. Understanding the effects of each preservation method on food has therefore, become critical in all the aspects.

1. INTRODUCTION

Thermal processing means preservation by application of heat. It involves heating of foods in hermetically sealed containers for a specific time at a specific temperature to eliminate the microbial pathogens that endanger public health and that micro-organisms that deteriorate food during storage. The credit for invention of thermal processing (Canning) goes to a French Confectioner, Nichola Appert. The application of heat is an important method of preserving foods and is also a means of developing texture, flavour and colour in some foods.

Today’s society is characterized by an increasing health consciousness and growing interest in the role of food for maintaining and improving human well-being and consumer health. Due to consumer’s profile being ‘‘rich in cash/poor in time’’, there is a demand for ready-to-eat products As a result of changes in consumer attitudes, the market of minimally processed (MP) fruits and vegetables has grown rapidly. In addition to their nutritional and sensory properties, foods are currently recognized as active and protective agents. Among the others, minimally processed products stand out as convenient novel foods that fit the many needs of a modern lifestyle as they combine technical content with an innovative food concept. Fresh fruits and vegetables are an essential component of a healthy diet, able to decrease the risk of cardiovascular diseases and cancer. Their consumption has continued to grow rapidly, linked to the increased public awareness of their health benefits.

Minimal Processing’ (MP) is a concept describing approaches to food safety and preservation that are designed to retain the natural and as-fresh properties of foods. Minimally processed fruits are new forms of product marketing, intended to meet the consumers’ desires for convenience and fresh-like quality. Minimally processed fruits and vegetables, also called ready-to-use, fresh-cut or pre-cut produce, are raw fruits and vegetables that have been washed, peeled, sliced, chopped or shredded into 100% usable product that is bagged or packaged to offer to the consumers high nutrition, convenience, and flavour while still maintaining its freshness.

1. INTRODUCTION

Admitably except for water and milk, no other beverage has earned such universal acceptance and esteem throughout the ages as wine. The aesthetic postures of wine can be gauged by the quotations like ‘wine is the most healthful and the most hygienic beverage (Louis Pasteur)’, ‘wine is a chemical symphony (Amerine). Man has been preparing and consuming since time immemorial a large variety of alcoholic beverages, ranging from mild stimulants to highly intoxicants liquors. Amongst the mild stimulants are the wines which have long association with human artistic, cultural and religious activities.

Grapes and wines are of immense importance to us and their sheer magnitude of production and associated investment, employment, enjoyment, tax revenue collected and the economic contribution is a justifiable. These play a major role in economics of major wine producing countries like Italy and France. Wine and brandy refer to the fermented by-products of grapes, member of genus Vitis notably the cultivars of V.vinifera L. as per the European definition. However, here these terms may also refer to the fermented by-products from any fleshy fruit or flower. Compared to the grapes, industry producing wine from other fruits is very small. Do these have any role to play especially in nutrition, health and economy of the horticulturally developed countries or are simply mild intoxicants consumed? Such queries at one or the other time may baffle the thinking of an inquisive reader. An attempt has been made here to discuss briefly the historical aspects, role of wine in the context of nutritive and therapeutic value, present status of Indian Wine Industry, research status and future strategies. Emphasis on its role in developing the horticultural industry would also be laid.

1. INTRODUCTION AND IMPORTANCE

Sensory evaluation is one of the important methods of evaluation of the quality of food. Without the sensory evaluation of a product whether it is fresh or processed, it cannot be launched in the market. All the other methods like physical, chemical and microbiological fails for the product development if sensory evaluation is ignored as the final acceptance can come from the sensory evaluation only. So sensory evaluation has got an upper edge as compared to the other methods of food quality evaluation. However, a collective approach of quality evaluation of a product that includes the physical, chemical, microbiological and sensory evaluation is the most acceptable approach today.

In the past, human sensory perception had been the only mean of assessment of product quality as illustrated by the classical examples of cooks who knew how to mask the off-notes long before the microbial assessment of quality came into existence. Everybody relied on the sensory evaluation of food as a criterion of quality assessment. In the past, even the kings depended upon “tasters” to assure that the food was suitable for their consumption in the past. The role of sensory organs in sensory evaluation of food is shown in Table 1. But later on, with the development of instrumentation, sensory analysis was overlooked and the instrumental methods were preferred as they were supposed to provide absolute measures of quality. Consequently, the product quality was traditionally determined by physical, chemical and microbiological criteria with the assumption that the products meeting the prescribed specifications in the above parameters would automatically meet the desired sensory quality. However, soon it was realized that without sensory evaluation, the acceptability of a product cannot be determined.

1. INTRODUCTION

Food is any substance consumed to provide nutritional support for the body. It is usually of plant or animal origin, and contains essential nutrients, such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism’s cells in an effort to produce energy, maintain life, or stimulate growth. A food contains some non-nutrients, some of which may even have a detrimental influence on the consumers, while some may be inert and have no effect. Nature has endowed many plants with the capacity to synthesize a wide variety of chemical substances that are known to exert a deleterious effect when ingested by animals and are called as antimetabolites. These substances are also referred to as antinutritional factors when they are present in food/feedstuffs and influence a metabolic pathway when introduced into and/or eaten by an organism.

There is a wide distribution of biologically-active constituents throughout the plant kingdom, particularly in plants, used as animal feed stuff and as human food. The knowledge that these compounds elicit both toxic and advantageous biological responses has given rise to several investigations in recent times as to their possible physiological implications in various biological systems. It is well known that plants generally, contain antinutrients acquired from fertilizer and pesticides and several naturally-occurring chemicals. Some of these chemicals are known as ‘‘secondary metabolites’’ and they have been shown to be highly biologically active. They include saponins, tannins, flavonoids, alkaloids, trypsin (protease) inhibitors, oxalates, phytates, haemagluttinins (lectins), cyanogenic glycosides, cardiac glycosides, coumarins and gossypol and the list is inexhaustible. Some of these plant chemicals have been shown to be deleterious to health or evidently dis-advantageous to human and animal health, if consumed in appropriate amounts. Most of these secondary metabolites elicit very harmful biological responses, while others are widely applied in nutrition and as pharmacologically-active agents. The pharmacological and other beneficial effects of these antinutritional factors in plants have been reviewed here.

19.1 Introduction

In self-pollinated crops, the methods of selection aim at improving individual plants. On the other hand, in cross-pollinated crops they aim at improving a population of plants. A population is a large group of interbreeding individuals. Hence, selection is called population improvement in cross-pollinated crops. Selection in self-pollinated crops results in isolation of pure breeding lines which is the end product. But in cross-pollinated crops, it results in an improved population which is used as the commercial cultivar. Improved inbred lines (also called inbreds) for producing hybrids can be obtained from such populations. Again, like many rounds of selection being practised in different inbreeding generations in self-pollinated crops we are also practising many rounds of selection in cross-pollinated crops. But, unlike self-pollinated crops selection in cross-pollinated crops is followed by intermating to develop a new population before starting another round of selection. One cycle of selection consists of selection of individual/family and intermating of the selected units. Such cycle is repeated till we get the improved population. This method of practising the cycles of selection and recombination in a population is called recurrent selection or population improvement. Frey (1983) prefers the use of recurrent selection for closed populations where no new germplasm is added to the population during selection. Population improvement was used for a group of breeding techniques where all aspects are similar to recurrent selection but with the provision of adding new sources of germplasm whenever feasible. It is only a matter of coincidence that past history of application of recurrent selection has been limited to closed populations, but its basic aim has always been the accumulation of favourable genes, without any restriction on the migration of new genes during the course of selection. Apart from a slight nuance, population improvement and recurrent selection are two titles of the same principle and procedure of manipulating the genetic potential of populations. Recurrent selection can also be applied in self-pollinated crops.
