Diagnostic imaging refers to technologies that doctors use to look inside the body of the patient for clues about any disease condition. A variety of machine and techniques can create pictures of the structures and activities inside the patient body. In India, some of these modalities like digital radiography and ultrasonography are being used at some of the veterinary colleges and reaseach institutes while at some places some of the veterinarians have access to the techniques like computed tomography (CT) and magnetic resoncace imaging (MRI) of the human hospitals. So this is the responsibility of the scientists and researchers engaged in the advancement of the diagnostic imaging and the manufacturing companies to make these facilities cot effective so that an animal of a common man can be benefited with these facilities.

Abstract

Mushroom has a great potential in India. Its production is gradually increasing at the annual rate of 7%. The total mushroom production in India is 1.13 million tones and on the other hand, mushroom production annually in china is 18.2 million tones. There are a no. 07 wild mushroom available in the world and medicinal properties much as anti Candida, anti tumor (including cervical, uterine, stomach cancer) and antis viral are rotally present. Of the entire wild mushroom tested, T. glolulum has the highest amount of protein, ask, Calcium, phosphorus and iron. A total of 172 wild mushrooms have been reported home NE India and majority of the wild mushroom is of the order Agaricales. There is a need to make a concerted study of the mushroom biodiversity and its use for economic activity.

Abstract

Whenever human beings come together and interact, there are bound to be conflicts. It is the struggle between individuals or groups or organizations for values, status, power or scare resources, that creates tension and frustration. It cannot be totally eliminated, it has to be managed. Positive conflicts sometimes lead to innovations or new directions of thinking in the Research and Development (R&D) environment. But negative conflicts mainly breed unproductiveness, a climate of distrust and suspicion, antagonism, and neglect of organizational goals. Conflict arises due to one of the three reasons : unacceptability, uncertainty and incomparability of alternatives. The problem of unacceptability arises when the most preferred alternative is not found to be acceptable. Uncertainty arises when the individual faces problem to select one from the alternatives. The incomparability dilemma is a situation where the decision maker does not have standards to compare alternatives. Modern managers must be equipped to deal with different types of conflict and devise strategies to resolve them. This chapter deals with conflicts at individual level, at group level or at organizational level, their resolution through negotiation or collaboration, models and methods for managing conflicts, etc in details. A healthy organization climate can unblock creative potential of its employees, streamlining and facilitating efforts for the good of the organization and its employees.

Current Status of Seed Production

Organized seed production in the country became possible with the formation of National Seed Corporation (NSC) during 1963, which paved the way for a sound seed industry to come as a consequence of the introduction of hybrid technology during 1961-65. The release of high yielding dwarf varieties of wheat and rice by the 1960’s gave further impetus to the growth of the seed industry in the country. For the total area under cultivation of 26.7 m hac and 44.8 hac of wheat and rice respectively, the seed requirement for these two crops alone come to 32 lakh tones and 13 lakh tones respectively of which the varieties contribute about 98 per cent and the hybrids 2 per cent. Only about 10-15 per cent of the total requirement is met by the seed producers leaving the balance for the farmers to manage and the seed producers have to grab the opportunity to supply quality seed materials in order to increase the production.

Mites have been known as pests of agricultural and horticultural crops since long but now they rank as very serious pests and vectors of many plant diseases. The application and extensive use of pesticides, fertilizer and improved cultural methods have probably favoured increase of the population. Mites as crop pests are confined to certain group of the other acari. Near about 20,000 species have been described of the total mite fauna on a world basis. From India, 660 species of phytophagous mites have been described and nearly 30 species are reported as potential pests (Gupta 1987). Phytophagous mite belongs to family - Tetranychidae, Tenuipalpidae, Tarsonemidae, Eriophyidae and Tuckerellidae. These mites cause direct damage like loss of chlorophyll, stunting of growth, defoliation, reduction in size and quality of fruits, appearance of various types of plant deformities etc. and all these severely affect the yield. Besides causing direct damages, few phytophagous mites inject toxic substances in to their hosts, which cause increased localized growth and disruption of tissue (Jeppson et al. 1975), and many species belonging to family – Eriophyidae are known to act as vectors of plant viruses. The dust entangled in the web formed by tetranychid mites on leaves prevent the sunlight reaching the leaf surface and as result photosynthesis is impaired, the leaves turn pale, yellow and fall down. This affects the vitality of the plant.

Women constitute 50% of our population. Their contribution to farming needs no emphasis as they are integral part of it. Women have developed farming in our country and contributed immensely for growth and maintenance of agriculture as a whole. But majority of them are not fully aware of sustainable agriculture in scientific terms although they practice it. Surveys and observations reveal that women are in favor of traditional agriculture and feel that traditional farming is more sustainable than the present one.

12.1. INTRODUCTION

Air is polluted when it contains enough unhealthy particles and gases to harm human beings, animals, plants and even objects such as building and statues. Air pollutant may present as solid, liquid or gas form. Industrial revaluation in the 19th and 20th centuries leads faster increase in concentration of air pollutants in the atmosphere. The most important air pollutants that damage the plants’ growth and development, subsequently the economic yields of crop plants are ozone (O₃), nitrous oxides (NO₂ and NO), carbon monoxide (CO), ammonia (NH₄), peroxiacetyl nitrate (PAN), sulphur dioxide (SO₂), hydrogen fluorides (HF), particulate matters (cement dust, magnesium-lime dust, carbon shoot etc.), smoke etc. Burning of hydrocarbons in motor vehicle engines gives rise to CO₂, CO, SO₂, and NO in varying proportions and ethylene (C₂H₄) as well as other hydrocarbons. Industrial plants release SO₂, H₂S, NO₂ and HF into atmosphere. Hydrogen peroxide (H₂O₂) is another potentially injurious molecule, can form by the reaction between O₃ and naturally release volatiles (terpenes) from forest trees.

‘Integument’, the outer layer of insects consists of the ‘basement membrane’, ‘epidermis’ and the ‘cuticle’. One of the most important characteristics of insects is the presence of the rather hard, flexible chitinous exoskeleton or cuticle, which covers the entire body and provides support to the body. The exoskeleton of insects that is akin to the internal skeleton of vertebrates accounts for their size and shape. Movement is made possible by the division of the cuticle into separate plates or sclerites.  Primarily these  sclerites  are confined to segments and the sclerite of one segment is connected to the sclerite of the adjoining segment by means of an articulate called ‘suture’, a region in which the cuticle is very thin and flexible. The cuticle of each segment is divided into four primary sclerites viz., a dorsal tergum, two lateral pleura and a ventral sternum. The dermal glands present in the epidermal layer secrete the entire cuticle of the insect.

Like that of the body, the cuticular skeleton of the appendages is divided into tube-like segments connected to one another by articular membranes, thus creating a joint at each junction. Such joints enable the segments of the appendages, as well as those of the body to move freely.

In addition to the exoskeleton, an endoskeleton is also developed. This may be an infolding of the procuticle that produces inner projections or ‘apodemes’ equal to bones in vertebrates on which the muscles are inserted.

One of the primary targets of genome analysis is to manipulate it at the level of genes, the units of inheritance. Introduction

India has the distinction of being the largest producer of pulses in the world. Among the important pulse crops cultivated in the country are: chickpea, pigeonpea, lentil, mungbean, urdbean, fieldpea, rajmash and lathyrus. The pulse crops occupied an area of 22.85 million ha with a total production of 13.07 million tones and average productivity of 572 kg/ha. Being a high protein grain, pulses have special status in the diet, particularly for vegetarian population. Apart from being a good source of protein, they are also good source of energy, essential amino acids and vitamins in the daily diets of the people, especially of low-income group. Pulses have importance in sustainable agriculture by way of fixing atmospheric nitrogen in the soil.But with intensification of agriculture and introduction of irrigation and other facilities the area and production under pulses is declining so much so that per caput availability of pulses has declined from 69 g day-1 to about  36 g day^-1.

Turmeric (Curcuma longa L.) is a tropical herbaceous plant extensively cultivated in India, Sri Lanka, parts of China and Pakistan.  Country of origin is not known with certainity, it is either of Chineese or Indian origin. India ranks first in area (1.49 lakh ha.) and production (5.27 lakh tonnes.) in the world and it is grown in most of the states in the country.  Major turmeric growing states are Andhra Pradesh (56,000 ha.), Orissa (23,000 ha.), Tamilnadu (17,000 ha.), Assam (12,000 ha.), West Bengal (11,000 ha.) Maharashtra (6,000 ha.)  Karnataka (6,000 ha.) and Kerala (3,000 ha.).  Andhra Pradesh ranks first in area and production in the country. Area under this crop is increasing in North Eastern States.

Turmeric belongs to family Zingiberaceae and genus Curcuma. Genus Curcuma has 42 species, of which Curcuma longa is extensively cultivated for culinary purposes, Curcuma aromatica for flavour and recently Curcuma amada (mango ginger) for preparation of chutneys. Turmeric is mainly cultivated for under ground rhizomes, rich in curcumin. Turmeric is traditionally used for medicinal, religious, culinary purposes and also as a cosmetic and dye (Shah 1997). Recent reports in controlling human cancer has given renewed interest on the crop. In Ayurveda, turmeric is regarded as aromatic, a stimulant tonic, carminative and anti helminthic. Essential oil of turmeric is antiseptic and is used in treating gall stones and gall complaints (Pruthi 1976).

This chapter demonstrates that modern advances in horticultural crop development may benefit from not only knowledge derived from extant ethnographic groups but extinct peoples as well. More than 18,000 archaeological sites were identified, and a dozen rock shelter sites investigated in the Zeekoe Valley, Upper Karoo, South Africa. A baseline for understanding potential contribution of plants to the Zeekoe Valley diet is crucial for developing models of land use and mobility patterns for Late Stone Age (LSA) inhabitants, particularly since  ethnographically known foragers in Botswana, some 800 km to the North, are as much as 80 % depend on plant foods for their survival.  Since native foraging groups are long extinct in this semi-arid region with abundant natural springs, a rigorous investigation of botanical and ethnohistoric literature forms the groundwork for field investigations where direct ethnographic observation is no longer an option. First, edible species in the study area are identified in the literature. They are then sought on the ground with the aid of local informants whose families reside in the valley for generations. It appears as though some knowledge of local plants gained from native foragers 150 years ago or more have remained in Afrikaans families passed down from landowning parent to child. On the ground, collection and middle range experimentation were followed by basic nutritional analysis.  These measures were then used to compare foraging efficiency to measures from extant foraging groups.

African leaf vegetables (ALVs) are vegetable species utilized for their leaves and have become a part of the African tradition. This is a dynamic concept that is changing with the African culture and the term ALV embraces not only indigenous, but also indigenised species. These species are very nutritious, and contain high levels of pro-vitamin A and iron. ALVs are often more hardy than the introduced “modern” vegetables. The important role that ALVs have played in African livelihood strategies has been ignored, especially in the last half of the twentieth century. This led to ALVs being seen as a low-status crop, but this perception  started to change during the last two decades. ALVs are entering the commercial market and regaining its equal status in many African countries. ALVs are mostly used as an ingredient in relishes and soups to accompany starchy staples and sometimes meat.

ALVs include species cultivated in farmer fields and home gardens, like  pumpkins and cowpeas, and species harvested from  wild and fallow lands, like eru and cleome. Certain cultivated species have only recently been domesticated after a long history of wild harvesting.  Currently, ALVs are mainly cultivated using traditional farm practices with almost no African countries having formal seed systems. After years of neglect by formal research, more and more research institutions are initiating research on ALVs. Amaranth, cleome, corchorus, cowpea, pumpkins, nightshades, african eggplant, moringa, ethiopian kale, roselle, bitterleaf, taro, slenderleaf and water spinach are listed as the most prominent ALVs in Africa.

In general terms, dormancy can be defined as a period during the biological cycle of the plant in which growth of the whole organism (seed) or a plant organ (bud, tuber, corm etc.) is suspended eventhough the environmental conditions for growth may be favourable. More specifically, dormancy refers to a condition in which growth is inhibited by a restriction of essential metabolic processes, such as water uptake, gas exchange and cell division, either as a result of endogenous dormancy-controlling factors or in response to exogenous factors such as changes in the environment. It is distinct from a transient state of quiescence or rest imposed by an unfavourable environment in that dormancy persists even when the environment becomes favourable for growth whereas quiescence ceases.

For wild plants, dormancy has evolved as a means of enabling the plant to endure periods of stress due to drought or low temperatures and is therefore critical for the survival of the species. In cultivated arable or vegetable crops, breeding has generally led to a loss of dormancy or a reduction in the length of the dormant period. In arboreal crops of temperate climates, however, bud dormancy is still an essential feature of the annual growth cycle of the tree.

Horticultural crops play an important role in Indian agricultural economy. Though only 2.4% of cultivated area is under these crops, they contribute about 21% to the Agricultural GDP. Though horticultural crops contribute more for the national economy, its contribution could be further increased by minimizing 30% loss of horticultural crops due to pests and diseases. Continuous and unrestricted use have dictated the need for development of ecologically safer pest management technologies. Among the non-chemical methods, resistant varieties, cultural practices, plant derivatives and biocontrol agents are important and these methods can be integrated successfully. In recent years, interest among regulatory authorities, agricultural advisors and growers has forced to seek for alternative solution of plant disease management. It has encouraged intensive research of microbial products as agents for plant disease management. This resulted in commercialization of a number of microbial biocontrol products.

Remote sensing is the art and science of recording, measuring, and analyzing information about a phenomenon from a distance. Humans with the aid of their eyes, noses, and ears are constantly seeing, smelling, and hearing things from a distance as they move through an environment. Thus, humans are naturally designed to be remote sensors. In order to study large areas of the Earth’s surface geographers use devices known as remote sensors. These sensors are mounted on platforms such as helicopters, planes, and satellites that make it possible for the sensors to observe the Earth from above.

Definition
Remote sensing can be defined as any process whereby information is gathered about an object, area or phenomenon without being in contact with it. Our eyes are an excellent example of a remote sensing device. We are able to gather information about our surroundings by gauging the amount and nature of the reflectance of visible light energy from some external source (such as the sun or a light bulb) as it reflects off objects in our field of view. Contrast this with a thermometer, which must be in contact with the phenomenon it measures, and thus is not a remote sensing device.

INTRODUCTION

Fungi naturally present in soil and rhizosphere of various crops serve as potential biological control agents of various plant pathogens. Species of fungi occurring in the genus Trichoderma have gained significant importance for use as agents for control of several diseases of cultivated crops. The last decade has witnessed a tremendous break-through in the research efforts on biological control of plant diseases in India especially by using species of Trichoderma and Gliocladium. Several economically important plant diseases of a variety of crops were effectively managed by using Trichoderma based biofungicides.

The work on biocontrol of pigeonpea wilt by Bacillus subtilis by Dr. R S Vasudeva and his associates, published as a series of papers in Annals of Applied Biology during 1950 to 1965 can be considered as a starting point for Indian work on biological control of plant pathogens (Mukhopadhyay, 1994).

1. Introduction

The chemical composition of a food is of utmost importance from many standpoints, including nutrition, safety, and stability to microbiological, chemical or physical changes. Analysis of these food components is required to provide nutrition labelling for informing the health-conscious consumer, for quality assurance during processing and storage, and for regulatory purposes. The methodology used in analysis will depend on the particular component and the nature of product being analyzed, the purpose of the analysis, and the availability of resources. The emphasis of this chapter is on understanding the principles, procedures and calculations involved in estimating a particular component in fruits, vegetables and their products.

In recent years, we are just experiencing marginal surplus production in cereals leading to self-sufficiency through green revolution. However, the shortage of production in edible oils has drawn the attention for the increased cultivation of oil seeds, and increased productivity per unit area to provide sustainable food and nutrition security (Swaminathan, 1989).

The importance of oil seeds cannot be over emphasized in the Indian economy. Oilseed occupied nearly 19 million hectares, next only to food grains, in 1986-1987. Yet, the domestic production in the country has lagged far behind the increasing demand for edible oils, necessitating a massive import of edible oils which lead to the drain of the valuable foreign exchange. The total import bill on edible oil has increased from 1.41 per cent in 1970-71 to 3.05 per cent in 1986-87. Even then, the annual per capita availability of edible oils registered only a nominal increased from 3.5 kg to 5.9 kg during the same period, against the nutritional norm of 14 kg (Suresh Pal, 1989). Due to the concerted efforts made through the ‘Technology Mission on Oilseeds’, oil seeds production reached a peak of 178.9 lakh tonnes during 1988-’89 in India (GOI, 1990a). This is an impressive achievement in Indian Agriculture, to reduce the bill on the import of edible oils from 4.11 per cent (1987-’88) to 2.58 per cent (1988-’89) (Gill, 1990). Further efforts in increasing oilseeds production definitely will go a long way in drastically reducing the present import bill.

Among the oilseed crop, sesame (Sesamum indicum L.), “The Queen of Oil Seeds”, is one of the important ancient and traditional crops occupying third position in terms of acreage on the oilseeds map of the country. It is commonly known as Gingelly, Til, Benniseed and Simsim. It is an important source of edible oil for the nutritional refugees of most part of the world, especially for India. The oil is rich in oleic and linoleic acid. In addition, it serves as a good source of proteins, vitamins and minerals (Nagaraj, 1990). Its high keeping quality deserves special mention.

Orchids belong to family Orchidaceae, the largest family of the flowering plants. The term ‘orchid’ has its origin from the Greek word, “orchid” meaning “testicle”, referring to the paired underground tubers of terrestrial orchids. There are several generas in orchids, which are popular for their separate importance as cut flower, pot plant, medicinal properties, flavour extraction, etc. The fascinating flowers exhibit an incredible range of shape, size and colour, long life of flowers on plant and an amazingly long keeping quality, which no other plant can claim.

ORIGIN AND DISTRIBUTION

Majority of the cultivated orchids are native of tropical countries and occur widely in humid tropical forests of South and Central America, Mexico, India, Ceylon, Burma, South China, Thailand, Malaysia, Philippines, New Guinea and Australia. Brazilean cattleyas, Mexican laelias and Indian dendrobiums, cymbidiums and vandas have been extensively utilized for the development of modern orchid industry in the world.

Clematis is member of the Ranunculaceae family which also known as buttercup family. This cosmopolitan genus comprises climbing lianas, small shrubs and erect sub-shrubs distributed predominantly in the temperate zone of both hemispheres but with some species distributed in tropical areas (Tamura, 1995, Johnson, 1997, Grey-Wilson, 2000 and Wang and Li, 2005). The word clematis is taken from Greek as in “klema” meaning “a vine branch”. Most species are known as Clematis in English while some are also known as Traveller’s joy, Leather flower, Vase vine and Virgin’s bower the last three being names used for North American species (Chawla et al., 2012). Most Clematis is climbers (Roh and Song, 1997), however; two notable exceptions are the species C. heracleifolia and C. integrifolia which are herbaceous and fit well in a perennial garden border. The vast majority of these are very hardy. Some species however, particularly the evergreens can only take a few degrees of frost. Most Clematis varieties produce single flowers. Some varieties produce double flowers; others produce both single and double flowers. Clematis blossoms often change colour, some very marked through the life of each flower particularly when grown in full sun. Pastel colours will hold their colour best if grown in some shade. Many Clematis species are scented, although none are strongly perfumed. The most-highly scented is the tender species C. armandii. Montana types can also be relatively aromatic often with a scent reminiscent of vanilla. Of the large flowering hybrids, Fair Rosamund is the only one with any noticeable scent.

1. Introduction

Celiac disease (CD) is an immune-mediated enteropathy triggered by the ingestion of gluten in genetically susceptible individuals. Gluten is the protein component in wheat, rye and barley. In the last 10 years, cutting edge scientific developments in this disease have led to the formulation of new concepts of epidemiology, pathophysiology and clinical manifestations. At present, the only available treatment for CD is a strict gluten-free diet (GFD) (Mulder et al., 2013; Theethira and Kelly, 2014). Until recently, the geographical distribution of CD was mostly restricted to Europe and other developed countries, such as the United States, Canada and Australia. Celiac disease is not only frequent in developed countries, but it is increasingly found in areas of the developing world, such as North Africa (Malekzadeh et al., 2005), Middle East (Rostami et al., 2004) and India (Basu et al., 2014, Deora et al., 2014; Yachha and Poddar, 2007). New epidemiological studies have brought evidence that this disorder is common in many developing countries as well, showing that the ‘global village of celiac disease’ has indeed a worldwide distribution (Fasano and Catassi, 2001).

The only available treatment for celiac disease is the strict, lifelong avoidance of gluten. When gluten is removed from the diet, the small intestine will start to heal and overall health should improve (Fasano and Catassi, 2001). Traditional substitutes for gluten-containing grains have been rice, tapioca, corn, and potato. However, more nutrient-dense grains, seeds, nut flours, and legumes are being incorporated into the diet to provide an enhanced palatability, variety, and nutritional quality. These include sorghum, millet, teff, quinoa, amaranth, flax seed, and buckwheat.

1. Introduction

1.1 Engineered health rice

Rice is one of the leading food crops in the world and sustains two-third of the world’s population providing 20% of the world’s dietary energy supply. It can be polished and marketed as white rice or can be marketed with the bran layer left intact as brown rice. The dry grain can then be steamed or boiled by the consumer to rehydrate and cook it (Kato, 2006). Despite its primary importance as a staple food, rice has several disadvantages. Primarily, rice is low in protein and high in starch. The low protein levels in rice can lead to protein malnutrition in societies where rice is the primary constituent of the diet. Deficiencies in essential amino acids may also result from a diet primarily comprised of rice. For example, lysine is the essential amino acid found in the lowest quantity in rice. The human body needs lysine for proper growth and repair of tissues. It is also important in the production of various enzymes, hormones and disease-fighting antibodies (Kato, 2006). The production of broken rice is nearly 15-20% of total production of rice (Bhullar and Bhullar, 2013). The broken rice is generally used for rice flour production and Indian traditional foods such as Idli, Dosa and weaning foods etc. Ugwu et al., (2012) reported that the rice broken can be utilized for the production of poly (3-hydroxybutyrate). The major value addition of broken rice is possible by reconstructing it into rice-shape and fortifying it with desired nutrients or micronutrients, which is a big challenge in terms of making the product acceptable to the consumers.

One approach to overcome the above mentioned challenges is to prepare artificial rice kernels or rice analogues by extrusion, in which the vitamins are embedded and consequently do not separate from the rice grains. This will utilize mainly the broken rice which is either discarded or sold at subsidized prices as the cattle feed. Furthermore, embedding makes extraction of the vitamin by rinsing or cooking more difficult and may provide a certain protection against oxidation, because the vitamins can be enveloped by a protective matrix (Steiger, 2010). The fortification of commercially produced staple foods allows exposed populations to benefit without making major changes to their eating habits (Kunz, 2009).The rice analogues prepared from extrusion can be used by addition of an appropriate proportion of water at a temperature ranging from 90°C-100°C, whereupon the rice product rehydrates within three minutes to obtain a product having the desired appearance and organoleptic properties to simulate natural rice grains (Harrow and Martin, 1982).

1. Introduction

1.1 Malnutrition

The term malnutrition generally refers both to under nutrition and over nutrition, but in this guide we use the term to refer solely to a deficiency of nutrition. Many factors can cause malnutrition, most of which relate to poor diet or severe and repeated infections, particularly in underprivileged populations. Inadequate diet and disease, in turn, are closely linked to the general standard of living, the environmental conditions, and whether a population is able to meet its basic needs such as food, housing and health care. Malnutrition is thus a health outcome as well as a risk factor for disease and exacerbated malnutrition, and it can increase the risk both of morbidity and mortality (Ogunrinade, 2014). A term used to refer to any condition in which the body does not receive enough nutrients for proper function. A person cannot properly digest or absorb nutrients from the food they consume, as may occur with certain medical conditions (Medicine, 2015). Malnutrition may range from mild to severe and life-threatening. It can be a result of starvation, in which a person has an inadequate intake of calories, or it may be related to a deficiency of one particular nutrient (for example, vitamin C deficiency).

Malnutrition is estimated to contribute to more than one third of all child deaths, although it is rarely listed as the direct cause. Lack of access to highly nutritious foods, especially in the present context of rising food prices, is a common cause of malnutrition. Poor feeding practices, such as inadequate breast feeding, offering the wrong foods, and not ensuring that the child gets enough nutritious food, contributes to malnutrition (WHO, 2015).

Pooled estimates report the prevalence of malnutrition among community-dwelling older adults of 6% and among hospitalized older adults of 39%. In developed countries, treatment of malnutrition is relatively inexpensive and effective: energy and protein supplementation using commercial “sip feeds” results in both weight gain and reduced mortality (Pereira et al., 2015). In 2013, one in four children under age five worldwide had stunted growth. Between 2000 and 2013, stunting prevalence globally declined from 33 to 25 %, and the number of children affected fell from 199 million to 161 million. In 2013, about half of all stunted children lived in Asia and over one third in Africa (UNICEF, 2015). Malnutrition may be several types as follows:

1. Introduction

Each day, millions of people take a small bag, drop it into a cup, pour in boiling water, and add a dash of milk plus a spoonful of sugar. People start the day with it, end the day with it, and also serve it socially or in times of distress (Herath and De Silva, 2011). The reason behind its popularity is based on the fact that the combination of theanine amino acid contained in tea and melatonin and B-complex vitamins contained in milk offers superior relaxing effects. Furthermore, the harmony of tea’s sweet aroma and milk’s natural sweetness will create a healthy low calorie drink.

Tea is one of the most pleasant drinks consumed by two third of the world’s population. It is not only the most popular and one of the oldest known beverages in the world but also an antioxidative agent available in everyday life which may help to prevent a wide variety of diseases such as cancers and heart diseases (Yang and Landau, 2000; Luczaj and Skrzydlewska, 2005). Tea provides a significant source of phenolic compounds in the diet. While polyphenols have long been of interest for their contribution to the astringenttaste of teas (Ding et al., 1992), research into the health benefits of tea has been actively pursued only in more recent times (Dufresne and Farnworth, 2001; Yamamoto et al., 1997). Even though the results are mixed for the relationship between tea and health in epidemiological and clinical studies, in vitro studies point to a range of mechanisms by which tea phenolics may help to offset chronic diseases such as cancer and cardiovascular diseases (Kris-Etherton and Keen, 2002).

The nutritional richness and the high biological value of dairy milk have made it an important constituent of the balanced human diet. It is associated with better growth, improved status of some micronutrients, cognitive performance, motor development and activity. It is composed of a mixture of nutritive components as well as other bioactive factors such as biogenic amines, conjugated linoleic acid (CLA), with relevant physiological benefits. The consumption of dairy milk and products exert a protective action in human health and have been confirmed in preventing several chronic conditions like cardiovascular diseases (CVDs), some forms of cancer, obesity, immunomodulation and diabetes (Pereira, 2014). The chemical composition of bovine milk consists of 87% water, 4% to 5% lactose, 3% protein, 3% to 4% fat, 0.8% minerals, and 0.1% vitamins (Pereira, 2014).

1. Composition of Milk Fat

Bovine milk contains about 3.5 to 5% total lipid, existing as emulsified globules 2 to 4 μm in diameter and coated with a membrane, casein. The composition of milk fat is somewhat complex. Triglycerides constitute approximately 98% of milk fat, which is found in the milk globule, with the remainder being made up of di- and monoglycerides, phospholipids, cerebrosides, cholesterol, vitamins, tocopherols, carotene, and flavor components. Phospholipids are about 0.5 to 1% of total lipids, and sterols are 0.2 to 0.5%. These are mostly located in the milk fat globule membrane (Jensen et al., 1991). Cholesterol is the major sterol at 10 to 20 mg/dL.

Importance of Fruits and Vegetables in Human Life

Fruit is the edible, and more or less juicy, product of a tree or plant and consist of the matured ovary including its seeds and adjacent parts. Usually fruits are sweet, with a wide range of flavours, colours and textures.

Composition

Fruits are very poor source of protein and fat. Avocado is the exception containing 28% fat. Fruits contain high amount of moisture hence they are highly perishable. They are also good source of fiber. Fruits are not very good sources of calories. Fruits like bananas give fairly good amount of calories. Ripe fruit contains a higher percentage of sugar than unripe fruit does and the sugar is chief in the form of sucrose, fructose and glucose. Generally fruits are poor source of iron, Mangoes are excellent source of carotenes. Oranges are fairly good source of beta carotene. Guavas are the best source of vitamin C. Citrus fruits are good source of vitamin C. Cashew fruits are inexpensive and rich in vitamin C, although there is variation of vitamin content from fruit to fruit most fruits in the raw state contain some ascorbic acid. If fruits are bruised, peeled, cooked or exposed to air, large amounts of the vitamin may be oxidized. Apples are not only expensive; they contribute little to the nutritive value. They give fiber to the diet.

Current and emerging animal nutrition, reproduction and health management technologies have the potential to improve efficiency of livestock production. However, the thermal stress or hyperthermia caused by elevated ambient temperature reduces feed intake, milk yield, growth rate and reproductive performance of livestock species. Livestock in tropical countries will be affected severely by the abrupt and fast-paced climate changes. The impact is not only on production traits, a number of animal species may become endangered. Many of the native livestock species still perform better under climatic stress and low-input conditions. It is necessary to catalogue the indigenous livestock genetic resources, elucidate their genetic make-up and regulation of key metabolic pathways of adaptation and productive attributes and using the inferences to develop strategies for utilizing livestock resources under climatic stress.

Abstract

The hilly regions of western Himalayas comprise of three states namely Jammu and Kashmir, Himachal Pradesh and Uttaranchal which are divided into High Altitude Temperate, High Hill Temperate and Valley Temperate zones. Through observations, trial and error, man has developed skills related to cultivation, utilization and livelihood. These were transmitted through generations and in this way, a system of traditional knowledge developed and moved forward for the benefit of the society. Food is the basic necessity for the survival of human beings. Since ancient times, various methods have been used to process and preserve foods especially in the Himalayan regions. The food habits and preparation of various dishes depend upon the availability of crops and surrounding vegetation. On the basis of the substrate used, traditional foods and beverages of Himalayan region are broadly classified as Cereal and Legume based, Milk based, Fruits and Vegetables, and others. Some of the popular traditional foods of Himalayan region are Aenkadu/Askalu, Bagpinni/ pinni, Chhangpa, Chaulai ka bhat, Kutu ki roti, Lesuwa roti, Tilkuta, Kaddu ke khwaire, Mooli ke khwaire, Sarson ki dhusi, Arbi ke sukhe danthal, Chaulai ki kheer, Ogal ka halwa. Traditional fermented foods and beverages are very popular in the tribal and rural areas of western Himalayas. Besides being source of nutrition, these fermented foods constitute staple food (Bhaturu) in larger part of western Himalayas while others are consumed during local festivals, marriages and special occasions. A variety of indigenous fermented foods and beverages available are; Kinema, Marcha, Phab, Bekanthu, Gundruk, Sinki, Soibun, Sura, Chhang, Daru, Angoori/ Kinnauri etc.Due to lack of proper scientific technology the quality of such foods especially beverages (many- a- times) is uncertain and their consumption leads to a higher incidence of fatal diseases among the consumers. This chapter briefly reviews the preparation, significance and quality of indigenous foods of Western Himalayas which offer tremendous opportunity for sustaining livelihood of the people of Himalayan region and stimulating agro-industrial development even in the developing countries, after upgrading and sustaining their quality.

Beekeeping symbolizes the biological interdependence between insects, pollination and production of seed. Honey bees have been tirelessly rendering this yeoman service to benefit human-kind since time immemorial. Beekeeping is defined as “the science and art of rearing honey bees for man’s economic benefits”. Since, honey producing bees are restricted to the genus Apis beekeeping is also called ‘Apiculture’. A suitable place selected for housing honey bee hives, equipments and related accessories is referred to as an “apiary”. The invention of movable hive with separable frames in 1851 by L.L. Langstroth gave beekeeping the impetus to flourish. Further fine-tuning of scientific rearing techniques in these movable hives helped in spreading beekeeping to the newer areas.

Honey Producing Species of Bee

About 20,000 bee species are found worldwide. However, only four species viz. the European honey bee (Apis mellifera Linnaeus), the oriental bee (A. cerana Fabricius), the dwarf bee (A. florae Fabricius), and the giant or rock bee (A. dorsata Fabricius) are commonly recognized as honey producing. Amongst these two, only A. cerana and A. mellifera are hived because these build multiple-combs in dark cavities. The other two build single comb nests in the open (Akratnakul 1987a, Ruttner 1987).

Cereal crops are interchangeably called grain crops. In many publications and correspondence, they are simply called grains or cereals. As of 2012, the top 5 cereals in the world ranked on the basis of production tonnage are rice (paddy), wheat, maize (corn), barley and sorghum. These crops are also among the top 50 agricultural commodities in the world with maize ranking second next to sugarcane. Rice (paddy) ranks third, wheat - 4th, barley - 12^th, and sorghum - 30^th. Another cereal, millet, ranks no. 42 (FAO Stat 2014, updated Aug. 18, 2014). According to Chapman and Carter (1976), “a cereal is generally defined as a grass grown for its small, edible seed.” They also explained that all cereals are angiosperms, monocots, and members of the grass family Gramineae. Similarly, Lantican (2001) defines cereal or grain crops as agronomic crops belonging to the grass family Gramineae or Poaceae which are utilized as staples; the word “cereal” is derived from the most important grain deity, the Roman Goddess Ceres. Among the food grains cereals occupies for most status in human food requirements. Cereals are grown under different agro-climatic (Upland, Low land & Rainfed) conditions and it is most important staple food of about 65% of Indian population. Cereals crop is attacked by a large number of insect pests right from initial to till the harvest of the crops. Brief descriptions of the major crops, major insect pest and appropriate control measures are given below:

Abstract: Agro-ecosystem analysis of the island farming system revealed four distinct micro farming situations (MFS) viz., Hilly (MFS I), Slopping hilly upland (MFS II), Medium upland valley (MFS III) and Low lying valley (MFS IV). The enterprise combination study indicated the suitability of plantation based cropping sequences + backyard poultry and livestock in hilly areas, Short and medium duration paddy, vegetables, floriculture, plantations, fodder + backyard poultry + goat,  fish cum poultry cum duck and cattle in slopping hilly uplands, vegetables, plantations + backyard poultry, fish cum poultry cum duck in medium upland valley and long and short duration paddy, vegetables + backyard poultry, fish cum poultry and cattle in low lying valley micro farming situations. Productivity and profitability analysis of different farming systems under various micro farming situations revealed that net return obtained from cropping was Rs 3,26,408,  livestock and poultry was Rs 64,300 in MFS I where as under MFS II, it is Rs. 1,53,989 from cropping, Rs 77,176 from livestock and backyard poultry and Rs 12,465 from poultry + duck + fish. In MFS III, net return obtained from cropping was Rs 9,297 livestock was Rs 72,306 and poultry was Rs. 2,630 and poultry + duck + fish was Rs 24,957. Similarly, in MFS IV, net return obtained from cropping was Rs 57,760 where as Rs 90,893 was obtained from livestock, Rs 11,000 from backyard poultry and Rs 14,872 from poultry

Abstract
Combined advancement in computer sciences and hardware with uniformly significant developments in molecular biology and chemistry are providing toxicology with a powerful new tool box. This tool box of computational models promises to increase the efficiency and the effectiveness by which the hazards and risks of environmental chemicals are determined. Computational toxicology focuses on applying these tools across many scales, including vastly increasing the numbers of chemicals and the types of biological interactions that can be evaluated. Apart from that, knowledge of toxicity pathways gathered within the tool box will be directly applicable to the study of the biological responses across a range of dose levels, including those more likely to be representative of exposures to the human population.  Although inappropriate pharmacokinetic properties are a major cause of abrasion in the safety issues are recognized as today’s single largest cause of drug candidate failure. It is expected that the right balance of in vivo, in vitro and computational toxicology predictions applied as early as possible in the discovery process will help to reduce the number of safety issues.

These techniques are tolerant of imprecision, uncertainty, partial truth, and approximation. INTRODUCTION

The ber or Indian jujube (Ziziphus mauritiana Lamk.) in the most common fruit crop grown in arid and irrigated zones of Indian sub-continent. It is one of ancient fruits of India which is cultivated practically all over the country for its fresh consumption. Ber is a tropical as well as subtropical fruit and can be successfully cultivated even in the most marginal eco-system of tropics and subtropics. Ber is a hardy fruit tree and is best known for growing under adverse soil and climatic conditions. It can thrive well even in drought, water-logged and salinity conditions. It is common notion among the people that ber is a poor man’s fruit. It is one of the most nutritious fruit compared to other ones. The grafted varieties of ber fetch even higher price in the market than several other fruits. Hence, ber stands no longer the poor man’s fruit. Now, ber growing has received a great attention and preferred as a commercial fruit crop in North Indian states like Punjab, Haryana, Rajasthan and Uttar Pradesh on account of its potential for higher yield and good economic return to the growers. Moreover, the tree has less water need in the summer months during the period of dormancy, thus considered an ideal fruit for cultivation in the arid and semi-arid regions of North India. Apart from ber, no other fruit trees grow wild so extensively in this region, thus it is becoming popular among the growers.

Nitrogen assimilation is the formation of organic nitrogen compounds like amino acids from inorganic nitrogen compounds present in the environment. Organisms like plants, fungi and certain bacteria that cannot fix nitrogen gas (N₂) depend on the ability to assimilate nitrate or ammonia for their needs. Other organisms, like animals, depend entirely on organic nitrogen from their food.

Plants absorb nitrogen from the soil in the form of nitrate (NO₃ ^-) and ammonia (NH₄). In aerobic soils where nitrification can occur, nitrate is usually the predominant form of available nitrogen that is absorbed. However this need not always be the case as ammonia can predominate in grasslands and in flooded, anaerobic soils like rice paddies. Plant roots themselves can affect the abundance of various forms of nitrogen by changing the pH and secreting organic compounds or oxygen. This influences microbial activities like the interconversion of various nitrogen species, the release of ammonia from organic matter in the soil and the fixation of nitrogen by non-nodule-forming bacteria.

Amino acids are biologically important organic compounds composed of amine (-NH₂) and carboxylic acid (-COOH) functional groups, along with a side-chain specific to each amino acid. The key elements of an amino acid are carbon, hydrogen, oxygen, and nitrogen, though other elements are found in the side-chains of certain amino acids. About 500 amino acids are known and can be classified in many ways. They can be classified according to the core structural functional groups’ locations as alpha- (?-), beta- (β), gamma- (?), or delta- (δ-) amino acids; other categories relate to polarity, pH level, and side-chain group type (aliphatic, acrylic, aromatic, containing hydroxyl or sulphur, etc.). In the form of proteins, amino acids comprise the second-largest component (water is the largest) of human muscles, cells and other tissues. Outside proteins, amino acids perform critical roles in processes such as neurotransmitter transport and biosynthesis. Amino acids having both the amine and the carboxylic acid groups attached to the first (alpha-) carbon atom have particular importance in biochemistry. They are known as 2-, alpha-, or ?-amino acids (generic formula H₂NCHRCOOH in most cases where R is an organic substituent known as a “side-chain”); often the term “amino acid” is used to refer specifically to these. They include the 22 proteinogenic (“protein-building”) amino acids, which combine into peptide chains (“polypeptides”) to form the building-blocks of a vast array of proteins. These are all L-stereoisomers (“left-handed” isomers), although a few D-amino acids (“right-handed”) occur in bacterial envelopes and some antibiotics. Twenty of the proteinogenic amino acids are encoded directly by triplet codons in the genetic code and are known as “standard” amino acids. The other two (“non-standard” or “non-canonical”) are pyrrolysine (found in methanogenic organisms and other eukaryotes) and selenocysteine (present in many noneukaryotes as well as most eukaryotes). For example, 25 human proteins include selenocysteine (Sec) in their primary structure, and the structurally characterized enzymes (selenoenzymes) employ Sec as the catalytic moiety in their active sites. Pyrrolysine and selenocysteine are encoded via variant codons; for example, selenocysteine is encoded by stop codon and SECIS element. Codon–tRNA combinations not found in nature can also be used to “expand” the genetic code and create novel proteins known as alloproteins incorporating non-proteinogenic amino acids.

Nucleic acids are polymeric macromolecules, or large biological molecules, essential for all known forms of life. Nucleic acids, which include DNA (deoxyribonucleic acid) and RNA (ribonucleic acid), are made from monomers known as nucleotides. Each nucleotide has three components: a 5-carbon sugar, a phosphate group, and a nitrogenous base. If the sugar is deoxiribose, the polymer is DNA. If the sugar is ribose, the polymer is RNA. Together with proteins, nucleic acids are the most important biological macromolecules; each is found in abundance in all living things, where they function in encoding, transmitting and expressing genetic information—in other words, information is conveyed through the nucleic acid sequence, or the order of nucleotides within a DNA or RNA molecule. Strings of nucleotides strung together in a specific sequence are the mechanism for storing and transmitting hereditary, or genetic, information via protein synthesis.

The term nucleic acid is the overall name for DNA and RNA, members of a family of biopolymers, and is synonymous with polynucleotide. Nucleic acids were named for their initial discovery within the nucleus, and for the presence of phosphate groups (related to phosphoric acid). Although first discovered within the nucleus of eukaryotic cells, nucleic acids are now known to be found in all life forms as well as some nonliving entities, including within bacteria, archaea, mitochondria, chloroplasts, viruses and viroids. All living cells contain both DNA and RNA (except some cells such as mature red blood cells), while viruses contain either DNA or RNA, but usually not both. The basic component of biological nucleic acids is the nucleotide, each of which contains a pentose sugar (ribose or deoxyribose), a phosphate group, and a nucleobase. Nucleic acids are also generated within the laboratory, through the use of enzymes (DNA and RNA polymerases) and by solid-phase chemical synthesis. The chemical methods also enable the generation of altered nucleic acids that are not found in nature, for example peptide nucleic acids.
