4.1 Introduction
Human milk widely acknowledged as the optimal source of nutrition for infants, providing a rich array of components crucial for their growth, repair and development. However, the composition of human milk can vary
significantly within and between feeds, throughout the day, over the course of lactation, and among different mothers and also populations. While this variability is beneficial for infant health and survival, it presents challenges for the management of nutrition of high-risk infants who require precise oversight. The composition of human milk can be altered by factors such as the handling of expressed milk, including how it is stored and pasteurized. Thus, proper management of expressed milk is essential. The recommended practice for infant nutrition is exclusive breastfeeding for the first six months, followed by continued breastfeeding for at least one to two years. Human milk is naturally suited to meet the nutritional needs of infants, providing both nourishment and bioactive compounds that support healthy growth and immunity.
Human milk contains a variety of bioactive components, such as immune cells, anti-infective and anti-inflammatory agents, growth factors, and prebiotics. In contrast to infant formula, which has a fixed nutritional profile, human milk is dynamic and can vary between and within feedings, influenced by maternal factors, environmental conditions, and the methods used for expressing and managing milk.
A thorough understanding of human milk’s composition is vital for effective infant feeding, especially for at-risk infants. It also allows for the assessment of how milk storage and pasteurization may impact its beneficial components. Additionally, some of the bioactive elements in human milk are being studied for their potential use in medical treatments, either as preventive or therapeutic agents.

The goods and services with the help of which the process of production is carried out, are called factors of production. Economists talk about four main factors of production: land, labour, capital and entrepreneurship (or organization). They are also called as the inputs of production. On the other hand, the goods produced with the help of these inputs, are called as the output.
1. Land
Land refers to all natural resources such as forests, water, climate, and soil. It provides space for livestock farms and raw materials for the dairy and meat industries.
Features of Land
1. Gift of Nature – Land and climatic conditions are naturally available. For example, the fertile plains of Punjab and Haryana are naturally suited for growing fodder crops like berseem and maize, which are essential for dairy farming. Similarly, the lush green pastures of Uttarakhand, Jammu & Kashmir and Himachal Pradesh provide an ideal environment for rearing sheep and goats.
2. Limited in Supply – Land is fixed, and certain resources like water bodies and fodder resources may deplete over time. Water scarcity in regions like Maharashtra has forced farmers to shift from water-intensive crops to drought-resistant fodder crops.

3.1 Malted Milk
Malted milk, originating from the ideas of British pharmacist James Horlick in the 19th century, was initially marketed under the name “Diastoid” before being trademarked as “malted milk” in 1887. Although initially targeted
for infants and invalids, its appeal expanded due to its nutritional value, convenience, digestibility, and palatability. Recognized globally for its lightweight, non-perishable nature, and high-calorie content, malted milk is
created by evaporating a mixture of malted barley, wheat flour, and whole milk until it forms a powder.
There aremainly two types of malt powder: diastatic and non-diastatic. Diastatic malt containing enzymes breaking down starch into sugar, aiding in dough rise and crust formation, particularly in bread making. Non-diastatic
malt lacks active enzymes and is primarily utilized for flavor enhancement, commonly in beverages. It may also include sugar, coloring agents, and other additives to improve taste and appearance.
3.2 Malting
Malting is a crucial process employed in treating cereal grains, such as barley, by inducing germination through soaking in water followed by halting the process through drying or heating with hot air. This technique encompasses two main stages: sprouting and kiln-drying. The term “malt” encompasses several products of this process:
1. Malted grains: These are grains, like barley, that have undergone the malting process.
2. Malt sugars: These are sugars, predominantly maltose-rich, derived from malted grains, often utilized in baking, such as baker’s malt.
3. Malted milk products: These include beverages like malted milkshakes, made using malted milk.

Production- Function- The technical law relating inputs to outputs has beengiven the name of production function. Production function expresses the relationship between physical input and physical output of a firm for a given state of technology.
Law of Variable Proportion or Law of Diminishing Returns (Short Run Production Function)
This law explains the relationship between inputs and outputs in the short period. According to this law, output can be changed by altering variable factors (such as labour and feed) while keeping other factors (such as land and infrastructure) constant. The law states that with an increase in variable factors, keeping other factors constant, total product initially increases at an increasing rate, then increases at a diminishing rate, and finally starts decreasing.
1. Total Product (TP) - Refers to the total output of the firm per period of time.
1. Example: Total litres of milk produced by a dairy farm per day.

2.1 Introduction
The continuous production of dry milk has become consistently significant within the dairy industry and is expected to continue growing due to its advantageous features. These include improved shelf life, reduced storage
requirements, and lower transportation costs, all of which contribute to favourable economic outcomes.
For example, non-fat dry milk is also known as skim milk powder, dried skim milk, non-fat dry milk solids, or dehydrated skim milk. Similarly, products like dried whole milk, dried cream, and dried buttermilk are often regarded as dried or powdered whole milk, cream, and buttermilk, respectively, based on their specific compositions.

Supply is the amount of a good or service sellers are willing to offer for sale at a specific price, in a specific market, over a specific time.
Stock vs. Supply
• Stock: All the milk a farmer has—say, 1,000L in tanks.
• Supply: What he sells—500L at Rs 50/L today. Supply is different from stock, as stock refers to the total quantity of a commodity that exists in the market, while supply is the quantity that is usually offered for sale at a particular price.
Law of Supply
The law of supply explains the functional relationship between the price of a good and its supply. When all other factors remain constant, an increase in price leads to an increase in supply. This means there is a direct proportional relationship between price and supply.
Exceptions
1. Land, rare goods, and labour supply in certain cases do not follow the law of supply.
2. The supply of rare goods cannot be changed with price fluctuations.

1.1 Introduction
Concentrated milks, like evaporated milk and sweetened condensed milk, serve as practical substitutes for fresh milk in regions where access to it is limited or where transportation and storage are challenging. These products go through specific processing techniques to reduce their water content, thereby improving their shelf life and transportability. Evaporated milk is created by removing water through evaporation and then
sterilizing it to prevent microbial growth. This process results in a thicker consistency and a slightly caramelized flavor due to the heat treatment. On the other hand, sweetened condensed milk is made by adding a significant amount of sucrose to the milk and excluding oxygen, which inhibits microbial growth. This results in a thick, sweet product suitable for various culinary uses. These concentrated milk products are usually packaged in small cans, making them convenient for storage and transportation. However, they are sometimes diluted before consumption with water to resemble the taste and consistency of fresh milk. In regions where even concentrated milks are not easily accessible, alternatives like whole milk powder or recombined milk are used. These alternatives involve dehydrating milk into powder form or reconstituting milk components to create a liquid similar to fresh milk. Innovations in processing and packaging have led to the development of alternative uses for concentrated milks, expanding their versatility beyond traditional applications. These products continue to provide essential dairy
nutrition in areas where fresh milk is scarce or hard to obtain, offering a shelfstable solution to meet dietary needs.

Definition of Utility
Utility is the ability of a good or service to satisfy human wants and needs in economics. It is an important concept as it represents the satisfaction experienced by a consumer from consuming a good or service
Utility characteristics
1. Measuring satisfaction, benefit, or happiness from a good or service is difficult.
2. Economists have devised ways to represent and measure utility in terms of economic choices that can be quantified.
3. Total Utility (TU): The aggregate sum of satisfaction or benefit gained from consuming a given amount of goods or services (e.g., drinking three glasses of water provides more satisfaction than just one).
4. Marginal Utility (MU): The additional satisfaction gained from each extra unit of consumption (e.g., the first glass of water gives maximum satisfaction compared to each additional glass).
5. Total utility usually increases as more goods are consumed.
6. Marginal utility typically decreases with each additional unit consumed, demonstrating the Law of Diminishing Marginal Utility.

Definition of Demand
Demand refers to the desire for a commodity that is backed by both purchasing power and willingness to pay at a given price within a specific period. In economics, we consider effective demand—not just absolute desire. A product is in demand only when individuals are willing and able to purchase it.
For example, many farmers may desire to buy cow mats, but if they lack the financial resources or are unwilling to spend on them, it does not count as effective demand.
Demand is formally defined as a “schedule or curve that shows the various quantities of a commodity that consumers are willing and able to purchase at different prices, within a specific time frame and market conditions.”
Law of Demand
The Law of Demand states that, ceteris paribus (all other factors remaining constant), the quantity demanded of a commodity varies inversely with its price. In simpler terms:
When the price of a commodity rises, the quantity demanded decreases. When the price of a commodity falls, the quantity demanded increases. This inverse relationship occurs because consumers tend to buy less of an expensive product and more of a cheaper one, provided other factors like income, preferences, and the price of related goods remain unchanged.

Economics revolves around key concepts such as goods value, price, wealth, income, savings, investment, and consumption. These concepts are interconnected and form the foundation of economic analysis. Below is a detailed explanation of each:

Definition of Goods
Goods refer to tangible or intangible items that satisfy human wants and have value. Goods can be material (physical objects) or non-material (services), and they play a crucial role in fulfilling human needs and desires. They form the basis of economic activity, as humans constantly seek to fulfil their needs and desires.
Examples
Tangible Goods: You can touch them. Food, clothing, vehicles, dairy products. Intangible Goods (Services): Services you experience. Veterinary services, teaching, medical care.
Classification of Goods in Economics
Goods can be categorized based on different criteria such as material nature, supply, transferability, consumption, ownership, and income elasticity.

Approaches to study subject matter of economics
There are two approaches to study subject matter of economics-
1. Traditional Approach
2. Modern Approach
Economics studies human economic activities, which involve the creation, use, exchange, and distribution of wealth.
1. Traditional Approach
This approach splits economic activities into four interconnected areas:
Consumption, Production, Exchange, and Distribution (CPED).
1. Consumption – Using Goods & Services
Consumption refers to the utilization of goods and services to satisfy human needs and wants. It involves the destruction of utility, meaning that once a good or service is consumed, it cannot be reused in its original form i.e. once used, their original form is gone (utility destroyed) Economics studies the nature of human wants, their characteristics, and how individuals make consumption decisions.

Evolution of Economics as a Discipline
1. Initially, economics was not a separate subject but a part of politics, ethics, and jurisprudence.
2. The study of economic ideas gained prominence through discussions on wealth, trade, and resource management.
3. Adam Smith’s book, An Inquiry into the Nature and Causes of the Wealth of Nations (1776), established economics as a distinct discipline.
4. Due to his contributions, Adam Smith is regarded as the Father of Economics.
Origin of the Term “Economics”

Intellectual Property Rights (IPR)
Intellectual Property Rights refer to the legal protections given to the creators of original works, including inventions, literary and artistic works, designs, symbols, names, and images. These rights allow creators to control the use of their creations, preventing unauthorized use by others.
Types of intellectual property rights
1. Patents: Protect inventions, giving the patent holder the exclusive right to  make, use, sell, and distribute the invention for a certain period.
2. Copyrights: Protect original works of authorship, such as books, music, and art. Copyright gives the creator exclusive rights to reproduce, distribute, and perform their work.
3. Trademarks: Protect symbols, names, and slogans used to identify goods or services. Trademarks prevent others from using similar marks that could confuse consumers.
4. Trade secrets: Protect confidential business information, such as formulas, processes, or methods, that give a business a competitive edge. Importance of IPR
• Incentive for innovation: IPR provides financial incentives for creators by ensuring they can profit from their work.
• Economic growth: By protecting inventions and creations, IPR encourages investment in research and development, leading to economic advancement.
• Consumer protection: Trademarks help consumers identify the source of goods and services, ensuring they get what they expect in terms of quality.

Seed production in spices varies depending on the specific crop and its biological haracteristics. Below is an overview of the seed production methods for each of the spices you’ve mentioned:
1. Ginger (Zingiber officinale)
• Propagation method: Ginger is propagated through rhizomes rather than true seeds. Selected healthy rhizomes are cut into pieces, each with at least one viable bud (eye).
• Planting: The rhizome pieces are planted in well-drained soil with high organic content.
• Maintenance: Regular watering and mulching are essential to maintain soil moisture. Weeding and pest management are also crucial.
• Harvesting: The rhizomes are harvested 8-10 months after planting. Some are reserved for the next planting season.
2. Turmeric (Curcuma longa)
• Propagation method: Similar to ginger, turmeric is propagated using rhizomes.
• Planting: Rhizomes are cut into pieces with at least one bud each and planted in a prepared field.

Callus induction from leaf and stem explants, followed by somatic embryogenesis. The protocol for black pepper (Piper nigrum L.) tissue culture involves several stages, including callus induction, shoot regeneration, root initiation, hardening, and implementation of tissue culture techniques. The general outline of the process based on recent advancements are as follows.
a. Callus induction
• Explants: Typically, leaves, stems, or nodes are used as explants.
• Medium: Murashige and Skoog (MS) medium supplemented with auxins like 2,4-Dichlorophenoxyacetic acid (2,4-D) @ 0.5-2.0mg/l or Naphthalene acetic acid (NAA)@ 0.5-1.0mg/l is commonly used to induce callus

Biotic stress, caused by pathogens, pests, and weeds, can severely affect the yield and quality of black pepper, making the development of resistant varieties a critical objective for breeders.
Current status
1. Research efforts: There have been considerable efforts to identify and develop black pepper varieties that are resistant to various biotic stresses. These include resistance to diseases like Phytophthora foot rot (caused by
Phytophthora capsici), quick wilt, nematode infections, and pest attacks like the pollu beetle.
2. Breeding techniques: Traditional breeding methods have been complemented by molecular breeding techniques. Marker-assisted selection (MAS) is increasingly used to accelerate the development of resistant varieties. The integration of genomic tools has also enhanced the efficiency of identifying resistance genes and their incorporation into high-yielding varieties.
3. Resistance sources: Several resistant genotypes have been identified, but their commercial success is still limited. The genetic diversity within black pepper and related species is explored to find novel resistance genes that can be introduced into cultivated varieties.

I have known Dr R.S. Chauhan al through his professional carrier. I came in his contact when he was a student, a research worker, a professional colleague. He is very hard working, sincere and dedicated scientist and teacher. I observed his remarkable skills, unwavering dedication and strong commitment for upliftment of research and the profession. He is known as an excellent teacher. He devised simple understandable means for complex topics.
His work on Panchgavya has won lots of appreciation at all levels. In fact he is a person who proved scientifically the application of components of Panchgavya on control of some untreatable disease like cancer.
I have absolutely no hesitation in saying that he is the “Father of Cowpathy”. He proved the efficacy and application of products of cow origin with scientific validation.

• Yield challenges: The average yield of black pepper is relatively low, primarily due to the susceptibility of many traditional varieties to diseases and pests, along with poor management practices and climatic challenges.

• Disease resistance: To develop varieties resistant to Phytophthora foot rot and other significant diseases.
• Yield improvement: To increase the overall productivity of black pepper plants, focusing on higher berry yield, larger berries, and better quality.
• Quality enhancement: To maintain or improve the quality of black pepper in terms of essential oil content, piperine content, and other flavour components.
 

Dr. Chauhan, a dedicated veterinary scientist, has built a remarkable reputation for his tireless efforts in animal welfare. • Selection: Identify plants with higher yield and better resistance to pests and diseases.

Advancing Research in Veterinary Pathology: Building upon his extensive research background, which includes authoring 120 books, contributing 101 chapters, and publishing 239 research papers, Dr. Chauhan aims to delve deeper into emerging diseases affecting livestock and companion animals. He plans to focus on molecular pathology to better understand disease mechanisms at the genetic level, facilitating the development of targeted treatments and preventive measures.
2. Promoting ‘Cowpathy’ and Indigenous Practices: Known as the “Cowpathy Man,” Dr. Chauhan has been a proponent of integrating traditional knowledge with modern veterinary practices. Introduction
The development of the domestic phenotype mirrors the domestication process. Are certain behavioral patterns typically lost when animal are domesticated? Why do domesticated animals exhibit some behaviors more frequently than their wild counterparts? Darwin (1868) believed that in captivity biological traits are lost through disuse. Hemmer (1990) proposed that domestic animals have experienced a kind of regressive evolution, in which their behavior is less influence by environmental stimuli than that of their wild counterparts. The Earth’s rotation around its axis influences our physiology and behaviour. Animal species that are compelled to be active continuously typically exhibit poor performance, health, and survival. However, we examine the evidence of animals displaying extended periods of activity with weakened or nonexistent circadian rhythms and no observable
negative consequences. Available reports suggested that there is a greater prevalence of around-the-clock and ultradian activity patterns than commonly acknowledged.
This is especially true among herbivores, animals in Polar Regions and constant physical environments, animals in specific life-history stages, and highly social animals. Various mechanisms exist, but research indicates that certain circadian pacemakers still function in animals that are active throughout the day and night. The prevalence of continuous activity in various animals and habitats, along with a wide range of underlying mechanisms, suggests a pattern of convergent evolution. The circadian system’s organizational principles and complexity allow for potential chrono-biological plasticity. Born in 1958 in a  small village near Aligarh, Uttar Pradesh, Amit grew up surrounded by fields, animals, and the rustic charm of rural India. This environment would unknowingly shape his path toward becoming one of the most sought-after veterinary doctors in the country.
A Humble Beginning
The Chauhan family owned a small plot of farmland and a handful of livestock, which formed their primary source of livelihood. His father, was a hardworking farmer who toiled from sunrise to sunset in the fields, while his mother, Prakash Vati Devi, managed the household and cared for their cows and buffaloes. Despite their modest means, the family placed immense value on education. Ramswaroop, an Intermediate passout in his youth which was quite an achievement few in the village had accomplished—dreamed of giving his children a brighter future.
Dr. Chauhan’s early years were spent observing the rhythm of village life. The crowing of roosters, the mooing of cows, and the occasional bleat of goats were the background score of his childhood. While other children enjoyed chasing buffaloes or playing in the fields, Dr. Chauhan was different. His deep empathy for animals was evident even as a child, as he often helped his mother care for sick cows or newborn calves. It was during these moments that the seeds of his future profession were sown.

Soon after completing masters in Veterinary Pathology, Dr Chauhan joined as Teaching Associate in the department of Microbiology and Public Health in Pantnagar and taught BVSc &AH students systemic Bacteriology, meat hygiene and milk hygiene. However, this period was very short of only few months as he joined as Assistant Professor/ Assistant Disease Investigation Officer in HAU Hisar (1983-1996) and was entrusted disease investigation besides teaching of UG and PG students. He taught hygiene to BHSc students, and Epidemiology, Zoonosis, Livestock and Poultry Disease Investigation courses to masters and doctoral students. He also guided several masters and doctoral thesis research on pesticide toxicity, reoviral infection, and protozoan parasite infections. He has written a book on “Text book of Veterinary Clinical and Laboratory Diagnosis which was released by Hon’ble Central Education Minister Km Shailja ji. Students were fond of Dr Chauhan because of his teaching skills, easy to learn process and friendly behaviour; among them are Dr Naresh Jindal, Dr NK Mahajan, Dr SK Khurana, Dr Rajsh Khurana, Dr RK Vaid, Dr Devendra Bist etc.
In Feb1996 he joined at Pantnagar as Associate Professor and was given responsibility of Veterinary Pathology teaching to BVSc&AH, MVSc and PhD students. The teaching skills of Dr Chauhan were appreciable and were very useful to the students. He prepared power point presentation of each and every topic with photographs, line drawings, video and graphs/ bar diagrams etc to make it more understandable to the students. Particularly Dr Chauhan’s teaching include the Indian perspectives including animal diseases which showed the right things present in the field. Many disease conditions are different in India in comparison to other countries; some important diseases present in India are mentioned in the books of foreign writers and similarly many diseases occurs in other countries are not having any presence in India. So it is very important to impart education to students in right perspective which they will face in the field. Dr Chauhan always discusses the epidemiology part of the disease whether the disease in present in India or not; if present then what is the magnitude of disease. Such information is not available in literature, it comes by virtue of experience.

What is Panchgavya?
Panchgavya is an ancient, holistic preparation derived from cows, revered in Hindu culture for its spiritual, agricultural, and medicinal benefits. The term “Panchgavya” comes from Sanskrit, where “Pancha” means five and “Gavya” refers to products obtained from cows.
