11.1 Introduction

The term ‘Dolichos’ derived from Greek language means long pod and ‘lablab’, an Arabic term, means production of sound by dried seeds in the pods. In India, it is grown all over the country but compact large acreage for commercial production is uncommon. It is grown for whole pod. Fresh seeds and dry seeds are used as pulse grain. It is used as pod vegetable, feed and green manure crop. It is very popular in villages as well as cities where less area is available for cultivation. The young tender leaves are used in salads and the relatively old leaves are cooked as potherb like spinach. Its fresh green pods contain 86% moisture, 3.8% protein, 6.7% carbohydrate, 0.7% fat, 0.9% mineral matter, Vitamin A 312 IU. It is good source of Vitamin B, Vitamin C, proteins, minerals and dietary fibres. Trypsin inhibitor and several anti-nutritional factors such as tannins and phytates are present in mature and dark coloured seeds. On heating it is broken down into toxic cyanogenic glucoside which is soluble in boiling water. Therefore, it is necessary to boil the mature seeds in water before consumption. Sem is of two types.(A) Dolichos purpureus var. typicus (Graden Type) is with soft, edible pod wall having less fibre. (B) Dolichos purpureus var. lignosus(Field bean) that is grown for fresh dry seed as pulse, pod wall has high fibre content and has characteristic aroma. Hyacinth bean is a perennial herbaceous plant often grown as an annual and pole types are photosensitive.

Dairy Industry in India
Milk holds a deeply symbolic place in Indian culture, far beyond its role as a mere food item. It is intricately woven into the cultural and historical identity of the nation, with the dairy industry serving as a cornerstone of India’s economy. The sector is a driving force behind rural development providing a crucial pathway to prosperity for millions of small-scale farmers. In the 1920s, modern milk processing and marketing technologies were introduced in India. The National Dairy Development Board (NDDB; founded in 1965), implemented Operation Flood (1970-96) to modernize the dairy sector through cooperatives. This led to the rise of dairy cooperatives countering the exploitation by private milk plants. The cooperatives followed the Anand model, a three-tier structure comprising village-level societies (producers), district-level unions (milk collection and processing), and state-level federations (marketing). Originating in Anand, Gujarat in 1946, the model was later adopted nationwide. The progress termed as White Revolution transformed India from a nation struggling with milk shortages into the world’s largest producer and consumer of milk. By 1997, India became the global leader in milk production with a volume of 70.9 million tons, surpassing the United States (FAO data rearranged by Our World in Data). Further in the year 2014, for the first time, it beat the entire European Union. Since 1950, India’s milk production has seen tremendous growth, rising from 17 million tonnes in 1950-51 to 230.58 million tonnes in 2022-23. The per capita availability of milk increased from 124 g/day in 1950-51 (PIB 2022) to 459 g/day in India during.

Introduction

Horticulture is the science of cultivation, management, postharvest handling, value addition and marketing of fruits, vegetables, ornamental, aromatic and medicinal plants, spices and plantation crops. Looking to its important role in nutritional security, poverty alleviation and employment generation, it has rightly been emerged in form of horticulture industry and as one of the most significant sectors in the world. The production of fruits, vegetables and flowers has acquired much importance in recent times due to their increasing demand. Changing lifestyles of people across the globe, attempts to overcome the stressful lifestyle, inclination towards healthy and balanced eating habits have made people include fruits and vegetables in their daily diet. In the case of flowers, the demand for fresh flowers has steadily increased not only for decoration but also for many other purposes like essential oils, cosmetics, aroma therapy, dry flowers, pot-pourries, natural dyes, medicines, etc. Rising incomes and growing consumer interest in a variety of fresh fruits and vegetables year-round is stimulating international trade in horticulture.

Introduction

The work on field drains and farm ditches are essential for providing proper irrigation to the crop. Leveling of field is equally important for smooth operation of various field activities including irrigation. Land grading in irrigated agriculture helps in uniform application of water, better water regulation and saving in irrigation time. Land grading helps in conservation of soil and moisture under rainfed conditions. It provides desired surface drainage under irrigated and rainfed conditions. Land leveling helps in the smooth operation of sowing/planting and harvesting equipment.

After attaining a rich experience over a period of time, our forefathers have developed very pertinent primitive knowledge in a wide variety of fields (Rohilla et al., 1999). These location specific wisdom are known as indigenous traditional knowleges (ITKs). Indigenous traditional knowledge are the upshots of the pragmatic approach by our sons of the soil. As such, there are many ITKs emerged due to the incremental and cumulative learning among societies living in close connection with nature. The traditional communities are often called as indigenous or local or ethinic people. They have accumulated lots of empirical knowledge gained from the day-to-day life. The variations in availability of raw materials and environmental conditions clubbed with time tested traditional knowledge and wisdom, have made people of different regions of the North Eastern hill states to formulate, develop and perpetuate consumption of a wide range of traditional foods and beverages unique to its places since ages (Savitri and Bhalla, 2007).

Polyacrylamide

Polyacrylamide is a cross-linked polymer of acrylamide. The length of the polymer chains is dictated by the concentration of acrylamide used, which is typically between 3.5 and 20%. Polyacrylamide gels are significantly more annoying to prepare than agarose gels. Because oxygen inhibits the polymer- ization process, they must be poured between glass plates (or cylinders).

12.1 Introduction

French bean (Phaseolus vulgaris L.) is one of the most important legume vegetables grown for its tender green pods for fresh consumption, processing and dry seeds. The pods are slender, 10-25 cm long, straight or slightly curved with prominent beak. Seeds are kidney shaped, elongated and white, red, purple or blackish in colour or mottled. The vegetable is in great demand in cities and is grown both commercially and in home gardens. Its major area is confined to hills, where it is grown for green pods. Punjab, Jammu and Kashmir, Gujarat, Karnataka, Tamil Nadu, Uttar Pradesh and Himachal Pradesh are the main states where it is being cultivated on large scale. Dry bean seeds are an excellent source of cheap protein and many cultivars contain 22-23 % protein. Hundred grams of edible fresh pods contain 91.4 % water, 1.7 % protein, 0.1 % fat, 0.5 % mineral matters, 4.5 % carbohydrates, 50 mg Ca, 28 mg P and 1.7 mg Fe. Its 100 g dry seeds contain 9.6 % water, 24.9 % protein, 0.8 % fat, 3.2 % mineral matters, 60.1 % carbohydrates, 60 mg Ca, 433 mg P and 2.4 mg Fe. In India, it is mostly grown for fresh consumption, while in USA it is grown for processing in large quantities. Dried beans are rich in protein and closely compared with meat. Phaseolus oborigineus is the progenitor of French bean. They are capable of utilizing atmospheric nitrogen with the aid of bacteria found in the nodules on the roots of the plants. Four cultivated species are seen under the genus Phaseolus, i.e., Phaseolus vulgaris—common red kidney bean, Phaseolus coccineus—scarlet runner bean, Phaseolus lanatus— Lima bean, Phaseolus acutifolius var. latifolius— Moth bean or Tapery bean. All the species are self-pollinated except lima bean which is often cross-pollinated and Phaseolus coccineus is generally cross-pollinated and long day plant.

It involves all the steps starting from the extraction till sowing that makes the seed a high quality product for distribution among the farmers for a profitable crop. It reduces the spoilage during storage, increase the shelf life of the seeds, guarantees good germination and field stand thereby reduces the risk of losing the crop at early stages.

Seed Extraction

The seed extraction methods vary with the stage at which the matured fruits are harvested for seed extraction. Some of the vegetable crops are harvested at well ripe stage while some others are harvested at mature dry stage. Proper extraction should be selected taking into consideration the easiness of seed extraction from the fleshy pulp, relatively more seed recovery and less damage to the quality of seeds. There are different methods of seed extraction includes manual method, fermentation method, chemical method and mechanical method.

Manual Method

The manual method of seed extraction varies depending on the harvested fruit type. There are two types of seed extraction in vegetable crops viz., dry extraction and wet extraction.

1. Dry extraction Method

Dry extraction method is following in vegetables where mature dry fruits or mature dried pods are harvested for seed extraction. The harvested dried fruits are kept in sun for 2-3 days. The dried fruits are split open and the seeds are extracted by beating with pliable bamboo stick or by beating against a hard surface. Heavy beating should be avoided to reduce mechanical injury to the seed. Excessive mechanical injury may result in lowering of seed viability. The extracted seeds are dried in the sun between 8.00-11.00 am and 2.00-5.00 pm to reduce the moisture content to a safe level. This is followed in crops like chilli, okra, sponge gourd, ridge gourd, french bean, lablab bean, cow pea, cluster bean etc.

Oil palm (Elaeis guineensis Jacq.) provides the highest oil yield per hectare among all oil crops (Corley and Tinker, 2008; Rival and Levang, 2014). Examining the global palm oil production statistics, which is extracted from the mesocarp of the oil palm, the total world production stands at 79.464 million tonnes. Indonesia leads the world production with 59%, while India ranks 13th with a production of 0.305 million tonnes, contributing insignificantly to the world palm oil production. Additionally, India imports about 19% of the world’s palm oil, accounting for 9.3 million tonnes, with a net worth of 11.7 billion U.S. dollars (USDA IPAD, 2024; Statista, 2024).
In this challenging scenario, expanding the cultivation area of oil palm with high-yielding, disease-resistant, and dwarf statured varieties is imperative. The National Mission on Edible Oil-Oil Palm has set a target area of 27,99,087 hectares, but the achieved area is only 3,70,028 hectares (NMEO-OP). To meet this target, obtaining quality planting material is crucial. Traditionalvegetative propagation is not viable for oil palm due to its lack of axillary branching or axillary meristem. Given its highly cross-pollinated nature and long breeding cycle, obtaining true-to-type progeny is challenging. Therefore, the importance of propagation through in vitro mass multiplication techniques in this crop cannot be overstated.

Introduction

Natural phenomena such as solar radiation, volcanic activity and ocean circulation influence climate and contribute to its variability. The challenge is to provide these diverse stakeholders with trusted, useful, science-based information so that they in turn can make informed decisions.

It is a discipline of science that describes handling, preparation and storage of food that can prevent food-borne diseases. When there are two or more cases of a similar illness from the ingestion of the same common food it is known as a food-borne disease outbreak (FSN, 2018). In order to avoid potential health hazards, food safety is very important. This needs safety between industry, market and the consumer. For food safety the labelling on food material is vital. This includes the origin of food, steps taken for food hygiene, food additives, pesticide residues, policies on biotechnology, food guidelines for the management of governmental import, export inspection and certification systems for foods. The food should be safe in the market with safe preparation and delivery of the food for the consumer. Foegeding et al., (1996) have done an assessment of risk factors with food borne pathogens.Warnock et al., (2007) have reported intervention to food safety.

When pathogens are in the food they may be transmitted to the consumer. It may result in an illness or death of the person or other animals. The pathogens include bacteria, viruses, molds and fungus. These multiply in the food medium. Joon et al., (2012) have found pathogenic bacteria in meat products of Korea. The developed countries have high intricate standards for the preparation of food; however, in the developing countries there are less standards and enforcement of the standards which are followed. Apart from food another major source of infection is water, which is very critical in spreading many diseases. It is possible to prevent food poisoning if good water is used for all purposes. However, it becomes difficult as in the food supply chain a large number of persons are involved apart from the fact that pathogens can be introduced into foods no matter how much precautions are taken. Cowden (2000) has studied the notification on food poisoning to improve health. Frenkel et al., (2015) studied the amount of wastes from food processing industries.

Abstract

Nutrition and genetics both have very crucial role in human health and in development of chronic diseases such as cancer, osteoporosis, diabetes and cardiovascular diseases. Difference between individuals in response to dietary intervention is a well-known phenomenon in nutrition research (Ordovas, 2008).The effect of dietary changes on phenotypes such as blood cholesterol, body weight and blood pressure can differ significantly between individuals (Ordovas et al., 2007). Various bioprocess i.e. ingestion, absorption, digestion, transport, metabolism and excretion of nutrients and food bioactive components in human body is carried out through proteins such as enzymes, receptors, transporters, ion channels and hormones. Genetic variation leads to altered production and affect functional properties of these proteins. Furthermore nutritional efficacy is also different among different individuals which might be affected by nutritional status. Solid waste disposal has become Nation’s great concern since after spending more than 50 percent of their budget by Municipalities, they could collect and dispose about 70% of MSW leaving many parts of the municipality unclean every day and residents are not at all satisfied (Sannigrahi, 2016). The Central Pollution Control Board (CPCB) collected data from 299 cities of India on the mode of collection of MSW and found that manual collection comprised 50% while collection using trucks comprised only 49% (CPCB Report, 2000). It is very interesting to note that majority (more than 90%) of MSW are disposed by dumping in unscientific open land filling on outskirts of towns and cities while 10% of collected and 2% of uncollected MSW are burnt in open condition.

In the past several Non infectious diseases (NIDs) of fish and shellfish have been observed in natural waters. However, with expansion in fresh, brackish and marine aquaculture including aquarium keeping world wide there is a phenomenonal increase in incidences of NIDs and economic loss. 1. Gas Bubble Disease (GBD)

Gas bubble disease (GBD), is caused by supersaturation of gases in water. The gas involved is nitrogen in most cases and rarelycarbon dioxide and oxygen can cause GBD as these two gases are used by fish tissues and readily processed.Oxygen can cause gas-bubble disease at about 350 per cent air saturation, but nitrogen can cause the disease even below 118 per cent. GBD becomes prominent whenever there is a change in temperature, pressure and turbulance in aquatic environment, leading to disturbance in metabolism of f ishes. Bubbles of gas may form in the eyes, skin, gills, fins and within the internal organs where small bubbles may coalesce into larger bubbles.Fish absorb the excess gas, which forms bubbles in the small blood vessels, due to pressure changes inside their body. Gas bubble disease (GBD), is seen both in captive and wild fish. When bubbles affect internal organs, some fish may diesometimes without obvious clear clinical signswhile other fish may be chronically affected, and have a reduced appetite, activity and buoyancy. GBD can also cause secondary bacterial, viral or protozoan infections.All fish and shelfishspecies as well as amphibians and aquatic invertebrates are susceptible to GBD.Sensitivity of fish to GBD in terms of pathology and mortality varies with species and age.

Food occupies first position among the basic needs of human beings. Food processing dates back to the prehistoric age when crude processing including various types of cooking, such as over fire, smoking, steaming, fermenting, sun drying and preserving with salt were in practice. These crude processing techniques remained essentially the same until the advent of the industrial revolution. However, the change in food habits and the quality consciousness of the consumers in the developed world raises the need of advancements in development of food processing like spray drying, juice concentrates, freeze drying and also introduces dried instant soups, reconstituted fruit juices, and self cooking meals such as ready-to-eat food rations etc., during 20th century.

This chapter provides an in-depth exploration of advanced techniques and conceptual frameworks—here termed “Weather Intelligence”—and their potential applications in precision agriculture. Although the term is not yet standardized, it serves as an exploratory framework for integrating advanced forecasting, diverse datasets, and data analytics to capture both natural and anthropogenic influences on weather patterns. The discussion spans crop and livestock production as well as allied sectors such as fisheries, aquaculture, plantations, horticulture, and specialized areas like flower farming. By integrating real-time data from sensors, remote sensing platforms, and historical records, these exploratory systems aim to empower farmers and food producers to optimize irrigation, planting, harvesting, and overall resource management. Agriculture has always depended on weather, yet the rapid pace of climate change and the need for sustainable practices have driven a technological revolution in farm management. In today’s digital age, advanced forecasting techniques and data analytics are converging into a new conceptual framework we call “Weather Intelligence.” Although this term is exploratory and not yet widely adopted, it encapsulates the vision of integrating high-resolution satellite imagery, IoT devices, and machine learning algorithms to forecast local microclimatic conditions with unprecedented accuracy. These forecasts enable proactive adjustments to critical operations—such as irrigation scheduling, planting, and harvesting, thereby mitigating weather-induced risks and enhancing productivity. Moreover, it is increasingly evident that weather patterns are not only shaped by natural phenomena but also by human-induced risks such as wars, conflicts, and environmental abuse. Factors like landfills, water and sea pollution, toxic dumping, and unsustainable industrial practices are altering microclimates around the world. This complex interplay of natural and anthropogenic forces calls for the incorporation of a broader array of variables and larger datasets into forecasting systems. In this context, embracing Weather Intelligence as a dedicated field of study and application in agricultural and allied sciences becomes not only desirable but essential. This chapter aims to detail the evolution and current state of these integrated approaches, discuss their potential applications across various agricultural sectors, and outline strategies for precision decision making. While much of the content is exploratory in nature, it provides a conceptual framework for future research

Abstract

A study on the Subsurface groundwater discharge (SGD) in the coastal Cuddalore region of south east India has been carried out. Measurement of surface water Radon, Water level, Electrical Conductivity (EC) and pH for a total of twenty four hours, by hourly interval the measurement has been calculated and promote correlated with tidal values calculated by WX Tide 32 software. The SGD measurements were made by using a modified seepage meter. The study reveals a match with water level variation and tide with minor variation due to influx of surface water. Saline discharges, fresh groundwater discharges and surface water mixing processes were identified along the coast. Lower SGD (37.24 – 79.16 cm/day) were observed during fresh groundwater discharge.
