Introduction

Vetiver, commonly known as Khus grass is a perennial grass of Indian origin. Vetiver roots contain fragrant essential oil, which is a perfume by itself. Aroma chemicals such as vetriverol, vetriverone and vetriveryl acetate are prepared from this volatile oil. In India, it is mainly used in perfumes, cosmetics, and aromatherapy, food and f lavouring industries. Since the plant has extensive finely structured fibrous roots, it is useful in both soil and water conservation and the plant itself is drought tolerant. The world production of vetiver oil is around 300 tons per annum of which India contributes about 20-25 tons only. The world major producers are Haiti, India, Java and Reunion. In India, it is cultivated in the states of Rajasthan, Uttar Pradesh, Karnataka, Tamil Nadu, Kerala, Andhra Pradesh and Telangana, with an annual production of about 20 tons of oil. The present consumption of vetiver oil in India is about 100 tons and 80% of the domestic consumption is met by export only. As the internal demand for vetiver oil is very high, concerns are risingover the improved production and quality of raw materials used. Vetiver is a miracle crop and a big boon for the farmers to increase incomes. This would increase farmer’s income by three to four times. This crop has demand not only in India but also across the world. India is gaining big ground in cultivation of vetiver.

Efficient irrigation is essential for maintaining crop productivity while conserving increasingly limited water resources. This chapter explores the application of artificial intelligence to smart irrigation systems and irrigation scheduling. It considers water balance and evapotranspiration modelling and examines AI architectures used for irrigation decision-making. Sensor technologies and Internet of Things integration provide continuous information about soil, weather and crop conditions. Optimization algorithms can use these data to determine appropriate irrigation schedules and improve water-use efficiency. The chapter also discusses emerging AI-based irrigation approaches and global case studies. Challenges associated with implementation, data requirements, system limitations and ethical considerations are examined, followed by future directions for intelligent and sustainable irrigation management.

Agro processing involves a diverse range of unit operations aimed at converting raw agricultural products into value-added goods. Each unit operation is designed to contribute toward creating high-quality, market-ready products, minimizing waste, and ensuring optimal utilization of raw materials. By combining these processes effectively, Agro processing maximizes the potential of agricultural resources and strengthens the overall food industry.
OVERVIEW OF MATERIAL HANDLING
Materials handling encompasses a broad spectrum of activities, including mechanical harvesting on farms, transportation of live animals, refrigerated transport of perishable goods, and pneumatic conveying of flour from rail cargo to bakery storage facilities. It is important to minimize product losses during these operations while maintaining the quality of raw materials, such as preserving vitamin content and physical appearance, ensuring sanitary conditions, reducing bacterial growth, and optimizing the timing of transfers to avoid delays that could compromise both the economy and product quality. The journey of agricultural produce from farms to processing areas often results in significant transformations. For instance, grapes are transported via tractors, trucks, or trailers to juice plants or wineries, where they are graded, washed, and processed further. However, there are limitations on the size of transport vehicles and the duration fruits and vegetables can be held. Since these are living, respiring products, prolonged storage can increase batch temperatures to levels that encourage spoilage.

Apiculture, or beekeeping, is a key contributor to the development of sustainable and eco-conscious farming systems. In the context of natural farming, where synthetic inputs are avoided, bees serve a dual purpose—as vital pollinators and as indicators of ecological well-being. Incorporating bees into such farming systems improves crop yields through efficient pollination and offers an additional source of income from honey and other hive-based products.

Natural farming promotes the peaceful coexistence of all living beings. Bees, as crucial players in preserving biodiversity and ecological balance, embody this principle. In contrast to conventional beekeeping, which may depend on artificial feeding, chemical treatments, and synthetic hives, natural beekeeping uses traditional, minimal-intervention practices that respect the bees’ natural instincts and life cycles. This ethical model emphasizes care for the colony over intensive honey harvesting or manipulation of the queen bee.

Leguminous vegetables include peas, French bean, Lima bean, broad bean, cowpea, hyacinth bean, winged bean etc. They belong to the family Fabaceae (Syn. Leguminosae). These are cultivated either as sole crop is sometimes as intercrop. In some areas they are used in backyard cultivation also. Most of them are short duration crops and are self pollinated.

8.1. Peas (Pisum sativum L.)

The pea (Pisum sativum L.) is a very common nutritioius vegetable grown in cool season throughout the world. It belongs to the family Fabaceae (Syn. Leguminaceae) and genus Pisum. A pea is most commonly the small spherical seed or the seedpod of the pod fruit Pisum sativum L. The pea cultivars are grouped into several groups based on shape of seed, plant height, maturity and use of pods. This crop is cultivated for its tender and immature pods for use as vegetable and mature dry pods for use as a pulse. In both the cases the seeds are separated and used as vegetable or pulse. The central Asia is regarded as the place of origin for all legumes including pea. Based on the genetic diversity, Central Asia, the Near East, Abyssinia and the Mediterranean is considered to be its centre of Origin. Cultivated garden pea is not seen in wild state and it might have been originated from wild field pea or other related species. In India it widely cultivated states of Uttar Pradesh, Bihar, Haryana, Punjab, Himachal Pradesh, Orissa and Karnataka. Followed by Madhya Pradesh, Himachal Pradesh, Assam and Jharkhand.

Cultivars/Varietie: Peas varieties are grouped based on maturity (early, mid season and late) plant height (Bush or dwarf, medium tall and tall). The major cultivars under cultivation in different parts of the country are Arkel, Bonneville, Harbhajan, FC-1, Arka Ajit, UN 53-6 (whole edible type), Jawahar Matar 1, Jawahar Matar 2, Jawahar Matar 3, Jawahar Matar 4, Jawahar Matar 5, Jawahar Peas 83, JP 4 (JM 6), JP 19, Lincoin, Mattar Ageta 6, Pantnagar Matar 2, Pant Uphar (IP 3), P 88, PRS 4,Ooty-1 and VL 3.

9.1. Onion (Allium cepa L.)

The onion (Allium cepa), which is also known as the bulb onion, or common onion is the most widely cultivated species of the genus Allium. It has been used as food since time immemorial and is an important vegetable all over the world. The genus Allium also contains a number of other species variously referred to as onions and cultivated for food, such as the Japanese bunching onion (A. fistulosum), Egyptian onion (A. proliferum), and Canada onion (A. canadense). The vast majority of cultivars of A. cepa belong to the “common onion group” (A. cepa var. cepa) and are usually referred to simply as “onions”. The Aggregatum Group of cultivars (A. cepa var. aggregatum) includes both shallots and potato onions. Onion is suggested to have been originated in Asia, particularly Pakistan and Iran.

China is the largest onion producer in the world followed by India. Largest area under onion is in India followed by China. The major onion producing state are Maharashtra, Karnataka, Madhya Pradesh, Rajasthan, Gujarat, Bihar, Andhra Pradesh, Tamil Nadu and Orissa.

Cultivars/Varieites: Onion varieties differ in size, colour of skin, pungency and maturation. In natural beekeeping systems, the management of pests and diseases focuses on prevention, ecological harmony, and chemical-free practices that safeguard both bee health and environmental integrity. Departing from conventional methods that often depend on synthetic antibiotics, fumigants, or miticides, natural approaches aim to fortify the colony’s inherent resilience through biological and culturally grounded techniques. Central to this strategy is the maintenance of strong, genetically robust colonies, ensuring clean and well-aerated hives, and providing nutritional support through diverse and abundant floral sources. Healthy, wellnourished colonies are inherently more capable of withstanding infections and parasitic invasions.

Indian apiaries commonly contend with pests such as wax moths, ants, wasps, small hive beetles, and mites like Varroa destructor and Tropilaelap sclareae. Diseases including American foulbrood, European foulbrood, chalkbrood, and Nosema can pose significant threats if not identified and contained promptly. Natural management emphasizes routine hive inspections to detect early symptoms, followed by the removal and safe disposal of infected combs. Maintaining adequate space between colonies can minimize disease transmission, while structural modifications to hive entrances and the use of barriers like ash rings or water moats effectively deter ants and other intruders.

Food processing is a fundamental component of the food industry that transforms raw materials of plant and animal origin into safe, nutritious, convenient and value-added products. This chapter introduces the basic concepts and evolution of food processing, tracing its development from traditional practices to modern technologies driven by consumer demand. It explains the major purposes of processing, including shelf-life extension, food variety, safety and preservation of nutritive value. The chapter also examines primary, secondary and tertiary processing and discusses the effects of processing on macronutrients and micronutrients. Understanding these fundamentals provides a foundation for evaluating conventional and emerging food-processing technologies.

Queen rearing and colony multiplication are central to sustainable and independent beekeeping, especially within the principles of natural farming. The queen bee serves as the core of the colony—ensuring reproduction and maintaining social cohesion through pheromonal signals that influence the behavior and unity of worker bees. A robust and fertile queen guarantees a consistent brood cycle, appropriate worker-to-drone ratios, and overall colony health. In natural systems, queens are raised without artificial grafting or chemical interference, allowing bees to follow their innate biological instincts.

Queen rearing occurs naturally through swarming or supersedure. During swarming, the old queen departs with a group of workers to establish a new colony, while the original hive nurtures a replacement queen. Supersedure takes place when bees sense the current queen is aging or weakening and raise a successor. Natural beekeepers can work in harmony with these processes—observing and supporting the development of queen cells, transferring brood or queen cells to new hives, and letting the colony follow its own cycle of renewal. This method enhances genetic strength and colony resilience.

Ichthyology: Science dealing with the study of fishes – a class of aquatic vertebrates most of whom depend for respiration exclusively on oxygen dissolved in water (Gr. ichtys = fish + logos = study).

Supercritical Fluid Extraction (SFE) is an advanced extraction technology that provides an efficient and comparatively sustainable alternative to conventional solvent-based extraction. This chapter introduces the fundamental principles of supercritical fluids and explains the mechanism by which desirable compounds can be selectively extracted from food materials. It examines the use of SFE for recovering aroma compounds, essential oils, flavours, pigments, colours, antimicrobial compounds and valuable bioactive substances. Particular emphasis is placed on obtaining high-purity extracts while minimizing toxic solvent residues. The chapter also discusses industrial food applications, process advantages and limitations, highlighting the potential of SFE for developing cleaner, efficient and value-oriented food-processing and ingredient-recovery systems.

Onion is an economically significant bulb crop cultivated across diverse agroecological environments. Its cultivars vary considerably in bulb size, shape, colour, pungency, maturity, storage behaviour and photoperiod response. Understanding its vegetative and reproductive morphology, growth habit, physiology and taxonomic relationships is fundamental to crop improvement and germplasm conservation. This chapter examines the botanical features and taxonomic position of onion within the genus Allium. It explains relationships among cultivated types, landraces and allied species and discusses varietal classification according to climatic adaptation and consumer preference. Classical characterization and molecular taxonomy are considered important tools for developing productive, resilient and market-preferred onion cultivars.

The reproductive physiology of finfish and shellfish involves the complex biological systems that regulate their breeding and spawning cycles. In aquaculture, a sound understanding of these systems is critical for effective hatchery operations, seed production, and broodstock management. Reproductive success in both groups is influenced by hormonal signals, environmental cues, and genetic traits. In finfish, reproduction is typically seasonal and sensitive to external factors such as light cycles (photoperiod), water temperature, diet, and overall water quality. Central to their reproductive regulation is the hypothalamus-pituitarygonadal (HPG) axis. The hypothalamus secretes Gonadotropin-Releasing Hormone (GnRH), which prompts the pituitary gland to release follicle-stimulating hormone (FSH) and luteinizing hormone (LH). These hormones drive the formation of gametes—oocytes in females and sperm in males. Oogenesis involves yolk formation and final maturation of eggs, while spermatogenesis includes sperm cell development and release. Spawning can be natural or artificially induced using hormonal treatments like human chorionic gonadotropin (hCG), Ovaprim, or carp pituitary extract.
In shellfish, including mollusks and crustaceans, reproductive strategies vary widely. Mollusks may have separate sexes or be hermaphrodites, and they typically respond to environmental changes such as shifts in temperature or salinity. For instance, in oysters, gametes develop within the gonads and spawning can be initiated using methods like thermal changes or chemical stimuli such as serotonin. Crustaceans, like shrimp and crabs, rely on the brain-eyestalkgonad axis. Here, the X-organ–sinus gland complex in the eyestalk secretes gonad-inhibiting hormone (GIH), which slows down reproductive development. To promote spawning in shrimp like Penaeus monodon and Penaeus vannamei, eyestalk ablation is often used to remove this inhibition. Carrot (Daucus carota L., 2n=2x=18) is a cool-season root vegetable grown all over the world in temperate as well as sub-tropical climates. In India, it is cultivated over an area of 24,000 hectares with an annual production of 3,50,000 metric tones with a productivity much lower (14.58 t/ha) than the world average (22.17 t/ha) as per FAO, 2004. Carrots are used for human consumption as well as for animal feed. Carrot can thus be used for augmenting fresh fodder supply to milch animals during the lean winter in Kashmir (Hussan and Ahmed, 1999). Carrot has a significant place as an ingredient in soups and sauces and in dietary composition and also as a salad. A sweet preparation called Gajar Halwa is very famous dish in North India. Besides canning, it is also used in preparation of pickles. It is also exported in the form of fresh roots to the countries like Kuwait and Sharjah. Carrot is a rich source of á and â- carotene. The total carotenoid content in the edible portion of carrot roots ranges from 6.00 to 54.80 mg/100g. The yellow and orange coloured roots contain relatively more carotenoid. Carrot roots contain protein, fat, carbohydrate, minerals (especially Ca, Mg, Na, K, Cu, S etc.) besides vitamin A, B₁, B₂, nicotinic acid and vitamin C. In carrot roots, sucrose is the most abundant with endogenous sugar contents 10 times than those of glucose and fructose.

Asia minor, Afghanistan, North West India, Iran and Turkey are the centers of origin of carrot. As per Encyclopedia Britannica, carrots have originated from Afghanistan, Punjab and Kashmir with secondary centers in Ethiopia and North America. The European carotene carrot (syn. Western carotene carrot, temperate carrot) has been derived from the Asiatic anthocyanin containing forms of carrot (syn. Eastern anthocyanin carrot, tropical carrot). Afghanistan is the centre of diversity of the purple coloured carrot (anthocyanin carrot) and as such this country is suggested as the primary centre for origin. Integration between the Asiatic and European carrots has given the present day forms which are fleshy, smoother, less forked and better coloured.

Punjab and Kashmir are also considered as primary centre of origin with secondary centers in Ethopia and North America. It is still found in its wild form in Himachal Pradesh and Kashmir valley where wild animals especially brown bear feed on its roots. People still eat the wild carrots in some parts of Kashmir (Yawalkar, 1980). In north India highly coloured types of carrots are found which are not available in Europe. The colour of carrot ranges from absolute colourless to light lemon, light orange, orange and deep orange, light purple, deep purple and almost black. It is also an indication of this region being a primary centre of origin of carrot.

Conventional fertilizers often exhibit low nutrient-use efficiency, resulting in nutrient losses, soil degradation, water contamination and unnecessary production costs. Nano-fertilizers offer controlled and targeted nutrient delivery through formulations engineered at the nanoscale. Their high surface-area-to-volume ratio can improve nutrient availability, plant uptake, growth, bulb quality and storage performance while reducing conventional fertilizer requirements. This chapter explains the nature, modes of action and potential benefits of nano-fertilizers in onion production. It also considers nano-biofertilizers, smart nutrient-delivery systems and nano-sensors. Particular attention is given to manufacturing cost, nanotoxicity, effects on soil microorganisms, farmer accessibility and the need for standardized safety and regulatory frameworks.

Two principal hatchery systems are widely adopted in aquaculture: the large-tank hatchery system and the small-tank hatchery system. Recently, hybrid systems have emerged that integrate advantageous features from both approaches, particularly addressing constraints related to spawner availability.
KEY DETERMINANTS IN HATCHERY DESIGN
Three major factors govern the design of an aquaculture hatchery:
1. Target Species: The specific biological and ecological requirements of the species to be cultured are critical. Hatchery infrastructure must accommodate these needs, and as such, a clearly defined target species is essential before initiating the design process.
2. Production Target: The hatchery’s output goal is determined by market demand and available financial investment. For species such as Penaeus monodon, where fry production is reliant on wild spawner collection, output is naturally capped by spawner availability. In contrast, species like P. japonicus and white shrimp, which have abundant spawner supply, allow for scalable production targets.
3. Financial Inputs: Investment capacity influences not only the scale of operations but also the complexity and automation of the hatchery. In Japan, for example, large-scale hatcheries culturing P. japonicus feature tanks with capacities reaching up to 2,500 cubic meters. In Southeast Asia, where P. monodon is the primary hatchery species and wild spawner availability is limited, smaller tank capacities are the norm.

Precision farming manages spatial and temporal variability within fields through targeted, data-driven interventions. Onion is particularly suited to precision management because its productivity and quality are sensitive to moisture, nutrients, environmental stress, pests and diseases. This chapter describes applications of GIS, GPS, variable-rate technology, IoT, cloud platforms, drones, remote sensing, multispectral imaging, smart sensors, artificial intelligence, automated systems and crop-response models. These technologies support soil assessment, field preparation, irrigation, fertilization, crop monitoring, stress detection, protection, yield estimation, harvesting and storage. Their potential to reduce input waste and improve profitability is considered alongside constraints involving investment costs, technical knowledge, connectivity, accessibility and data privacy.

In Indian aquaculture, live feed plays a critical role, especially in nurturing the larvae of fish and shrimp. Commonly used live feeds include rotifers, copepods, and Artemia nauplii, which are vital for the early survival and growth of larvae. The process of producing these feeds typically begins with microalgae cultivation, which serves as a foundation for developing high-quality larval feed and successful hatchery seed output.
Live feeds provide essential nutrients and help stimulate the feeding instincts of larvae—especially crucial when the larvae are transitioning from utilizing their yolk reserves to external feeding.
LARVAL CHALLENGES
Marine fish species such as bass, bream, meagre, and sole have very small larvae with limited yolk reserves that last just 2–3 days at 20°C. Their small mouths limit the size of food particles they can consume. While shrimp larvae also face food size issues, their appendages aid in capturing and breaking down food, making it less restrictive.
Species like penaeid shrimp go through developmental stages where their feeding habits shift—from herbivorous filter-feeding on microalgae to becoming carnivorous, feeding on organisms like Artemia. Mollusks, including oysters, clams, mussels, and abalone, feed on microalgae throughout their lives using filter-feeding mechanisms.
Natural and Cultured Diets
In the wild, these larvae feed on a wide range of phytoplankton (like diatoms, flagellates, and green algae) and zooplankton (such as copepods and small crustacean larvae). This diversity in plankton sizes and nutritional profiles is essential for meeting their dietary needs. However, collecting such natural plankton on a large scale isn’t practical for commercial aquaculture

Ginger is used extensively as a spice in cuisines throughout the world. Ginger belongs to Zingiberaceae family and an English botanist William Roscoe (1753-1831) gave this plant the name Zingiber officinale in the year 1807. The name of the genus Zingiber derives from a Sanskrit word denoting “horn shaped” in reference to the protusions on the rhizomes (Ghosh et al., 2011). It is an oldest rhizome widely domesticated as a spice where the edible part is the swollen underground stem or rhizome. The Zingiberaceous plants have strong aromatic and medicinal properties and are characterized by their tuberous or non-tuberous rhizomes (Chen et al., 2008). Ginger is a medicinal plant that has been widely used all over the world, since antiquity, for a wide array of unrelated ailments including arthritis, cramps, rheumatism, sprains, sore throats, muscular aches, pains, constipation, vomiting, hypertension, indigestion, dementia, fever and infectious diseases (Ali et al., 2008). Ginger has direct anti-microbial activity and thus can be used in treatment of bacterial infections (Tan and Vanitha, 2004).
