Most raw feed ingredients used as an energy and/or a protein source in poultry feed are grown, harvested, processed, and transported from outside of the poultry industry. Poultry feed are routinely subjected to contamination from diverse sources which may have a serious consequences on the safety of poultry products. Public concerns over food safety from the food of animal origin is a cause of global concern in the recent years due to problems such as bovine spongiform encephalopathy (BSE), dioxin and melamine contaminations, microbial resistance to antibiotics and outbreak of food borne bacterial infections (food poisoning) (Panda, 2013).

Pumpkin (2n = 40) is an important ‘pepo’ vegetable of the Cucurbitaceae family. Five domesticated species viz., C. maxima, C. moschata, C. pepo, C. argyrosperma and C. ficifolia are included in the Cucurbita genera (Schaffer and Paris, 2003). Owing to the presence of maximum genetic diversity in the neotropical regions and its ability to grow in varied agro-ecological conditions and its tolerance to hotter climatic conditions as compared to the other cultivated Cucurbita species, C. moschata is known as “tropical pumpkin” (Andres 2004). In terms of the average nutritive values, pumpkin (2.8) stands at a higher position when compared to many widely grown vegetables. The fruits are rich in carotenoid pigments. However, the proportion of beta carotene is higher than the others. Beta carotene shows strong anti oxidative and anti-cancer properties. While, it has relatively low content of other carotenoids like alpha-carotene, lutein, zeaxantin and violaxantin (Matus et al., 1993; Fraser and Bramley, 2004). Moreover, pumpkin fruits are also rich in mineral elements viz., potassium, phosphorus, magnesium, iron and selenium. The mature pumpkin seeds contain the essential unsaturated fatty acids and minerals like zinc. Pumpkin-rich diet has also shown to have a pharmacological effect on reducing blood glucose (Xiong and Cao, 2001; Cai et al. 2003). Further, water-extracted pumpkin polysaccharides showed better hypoglycemic (Zhang and Yao, 2002). As a result, pumpkin has emerged as a staple food in many developing countries (Ferriol and Pico, 2008).

Introduction
The discovery of antibiotics in the early 20th century revolutionized medicine, agriculture, and public health. These compounds, capable of inhibiting or destroying pathogenic bacteria, not only saved millions of human lives but also transformed animal production systems by reducing morbidity and mortality, improving growth rates, and ensuring food security (Phillips et al., 2004). The application of antibiotics in food animals,whether for therapeutic, prophylactic, or growth-promoting purposes,has been instrumental in increasing global meat, milk, egg, and fish production, thus addressing the nutritional needs of a growing population (Darwish et al., 2013; Chen et al., 2019). However, the indiscriminate and excessive use of antibiotics in animal agriculture has created unintended consequences, most notably the presence of antibiotic residues in foods of animal origin and the global acceleration of antimicrobial resistance (AMR) (Bacanli & Basaran, 2019; Shahid et al., 2021). Antibiotic residues in food is the trace amounts of active compounds or its metabolites that remain in edible animal tissues, milk, eggs, and aquaculture products causes significant concerns for both consumer safety and public health. Even when below the maximum residue limits (MRLs) established by regulatory authorities, prolonged exposure may lead to allergic reactions, disruption of the gut microbiome, reproductive and developmental toxicity, mutagenicity, nephropathy, and in certain cases carcinogenicity (Ngangom et al., 2019; WHO, 2020). Furthermore, residues contribute to the selection pressure that drives the emergence and dissemination of resistant bacterial strains in humans, animals, and the environment (FAO, 2019; O’Neill, 2016). The One Health framework highlights these interconnected pathways, recognizing food as a critical link between veterinary antibiotic use and human AMR burden (Robinson et al., 2016). Globally, approximately 73% of antibiotics are consumed in food animal production, with projections estimating a further 11–67% increase by 2030,largely by intensification of livestock and aquaculture in developing economies (Van Boeckel et al., 2015; Tiseo et al., 2020). While industrialized nations have implemented bans on antibiotic growth promoters and introduced robust surveillance programs, most low- and-middle-income countries still facing challenges (Antibiotics, 2021; WHO, 2019). Consequently, foods containing antibiotic residues frequently enter local and international markets, undermining food safety standards and exacerbating AMR risks (Darwish et al., 2013; Antibiotics, 2021). Antimicrobial resistance (AMR) has emerged as a major global public health crisis, directly causing an estimated 1.27 million deaths and contributing to nearly 5 million deaths worldwide in 2019. Recognizing its severity, the World Health Organization (WHO) has identified AMR as one of the top ten threats to global health(Murray et al., 2022). By 2050, global economic losses linked to AMR are projected to reach USD 100–210 trillion, with Asia bearing a disproportionate mortality burden (O’Neill, 2016). Countries like India, with large livestock populations, rapidly growing aquaculture industries, and high human antibiotic consumption, represent critical hotspots where food, health, and environmental risks intersect (Chauhan et al., 2018; ICMR, 2020). Given these alarming trends, understanding the occurrence, detection, and consequences of antibiotic residues in foods of animal origin is paramount. This chapter explores the co-relationship between origin of antibiotic residues and AMR, regulatory measures aimed to safeguard food safety and strategies for prevention and control, framed within the One Health approach.

Livestock transportation is a process of carrying animal from one place to another by different means of transportation. It is a stressful, threating and not familiar event of domestic animals. Livestock is transported for many reasons like marketing, slaughter, changing of owner, re-stocking and desirable grazing area)Animals who are transported for slaughter are stressful due to various component like loading, unloading, restraining, unfavorable weather condition, thrist, hunger. During transportation there are many rules and regulation by different countries which should be strictly implemented) Cattle and other animal species should be transported with partition. Birds and lab animals are transported in cages or any airy cartridge or basket. During transportation food and water should be withheld for 24 hours. if the transportation is more than 24 hours animal should be watered and fed in transit.

The metal particles in nanometer scale shows exciting optical and electronic characteristics when compared with respective bulk metals. Because of the inherent electronic properties of the metal and metal oxide nanoparticles these nanostructure materials are applied in various disciplines in recent days. Mostly these nanoparticles can be synthesized either top down or bottom up approaches. The conversion of bigger size particle or matter into tiny particles is called top down approach where as smaller particles or atoms joined together forming particles in regular shape within nanometer scale dimension is called bottom up approach. The formation of nanoparticles by chemical reduction is an example for the later one and the reduction size with the help of mechanical crusing leads to the formation of fine nanoparticles is named as top down approach. Mostly nanoparticles can be synthesized by chemical method because of its easiness to synthesis particles with uniform size and high purity.

Lawn is an integral part of any garden and it gives pleasure while sitting during evening in summer and one can enjoy good sunshine during winter. Hence, it is often referred as “heart of the garden”. It is covered with perennial grass and provides open landscape to the house and adds aesthetic beauty to the surroundings. Good lawn is essential to have in a good garden. It is permanent feature, which occupies 60% share of total garden area. Here in this chapter lawn is divided into two parts. There are approximately 620 genera and 10,000 species of grasses worldwide. Grasses are used extensively used throughout the world for their beauty and utility. Grasses are found from temperate to tropical to arid semi arid regions and suits in most extreme climatic conditions and have adapted to a worldwide climate and zones. Grasses are used as fodder, food, medicinal and for aesthetics purpose and it belongs to family Gramineae.

Introduction

Lipids are among the major components of food of plant and animal origin (food lipid). There is no precise definition available for the term lipid; however, it always includes a broad category of compounds that have some common properties and compositional similarities. Lipids are materials that are sparingly soluble or insoluble in water, but soluble in selected organic solvents like benzene, chloroform, ether, hexane, and methanol. Together with carbohydrates and proteins, lipids constitute the principal structural components of tissues (Erwin Wsowicz et al., 2004). Lipid oxidation is one of the major reasons that foods deteriorate and is caused by the reaction of fats and oils with molecular oxygen resulting in off-flavours that are generally called rancidity. Exposure to light, pro-oxidants and elevated temperature will accelerate the reaction (Velasco, J et al., 2010). Rancidity is related to characteristic off-flavour and odour of the oil. There are two major causes of rancidity. One occurs when oil reacts with oxygen and is called oxidative rancidity (Ribeiro et. al., 1993). The other cause of rancidity is by a combination of enzymes and moisture. Enzymes like lipases liberate fatty acids from the triglyceride to make di and monoglycerides and free fatty acids and such liberation of free fatty acids is named hydrolysis. Hydrolysis is additionally caused by chemical process that’s prompted by factors like heat or presence of water. Rancidity caused by hydrolysis is called hydrolytic rancidity. Oxidation cares mainly with the unsaturated fatty acids. Oxidative rancidity is off interest because it results in the event of unfavourable off-flavours which will be detected early within the development of rancidity, more so than in the case of hydrolytic rancidity. Oxidation can alter the flavour and nutritional quality of foods and produce toxic compounds, all of which may make the foods less acceptable or unacceptable to consumers. Oxidation products typically include low relative molecular mass compounds that are volatile also as undesirable off-flavour compounds (Food lipids).

Centesis is a surgical puncture or perforation into body cavity or structure usually done to aspirate fluid, air or tissue. The medical purpose of puncturing body cavities is not only to obtain fluid sample for diagnostic purpose but also to remove excessive fluid for therapeutic purpose for alleviating the respiratory distress owing to excessive fluid accumulation in peritoneal cavity, pleural cavity or pericardial sac. This procedure is usually done to get fluid from abdominal cavity, thoracic cavity, pericardial sac or joint capsule and is aptly known as abdominocentesis, thoracentesis, pericardiocentesis or arthrocentesis respectively.

This chapter delves into the intricate world of monsoon forecasting, exploring its historical roots, the scientific principles that underpin it, the diverse methodologies employed, and the continuous efforts being made to enhance its accuracy and utility. We will embark on a detailed journey through the complexities of the Indian monsoon system, examining the atmospheric and oceanic factors that drive its variability. From understanding the large-scale circulation patterns to deciphering the influence of regional phenomena like the El Niño-Southern Oscillation (ENSO) and the Indian Ocean Dipole (IOD), we will unravel the key drivers that forecasters consider. The chapter will then explore the spectrum of forecasting approaches, ranging from statistical models based on historical data to dynamic models that simulate the intricate physical processes of the atmosphere and ocean. We will also discuss the role of satellite technology, ground-based observations, and high-performance computing in generating increasingly detailed and reliable forecasts. Furthermore, this chapter will critically assess the current state of monsoon forecasting, acknowledging both its advancements and its inherent limitations. We will address the challenges in achieving the desired levels of accuracy, particularly at regional and local scales, which are most relevant to farmers. Understanding these limitations is crucial for setting realistic expectations and guiding future research directions. Finally, and perhaps most importantly, we will examine the crucial link between monsoon forecasting and the needs of the agricultural sector. We will revisit the expectations of farmers regarding forecast information – their need for accuracy, timeliness, localization, specificity, and actionable advice. By understanding the gap between current forecasting capabilities and these requirements, we can better appreciate the ongoing efforts to bridge this divide through improved forecasting techniques and effective dissemination strategies. Abstract

In this investigation the low dose effects of pesticides were analyzed both in vitro and in vivo in peripheral blood samples from healthy donors and also in farmers occupationally exposed to pesticides. In vitro studies were conducted to assess the toxicity caused by commonly used pesticides like monocrotophos, profenofos, chlorpyriphos, endosulfan, acephate on lymphocytes from peripheral blood samples. In almost all experiments we could determine chromosomal aberrations and DNA damage at 1/10th of LC50 dosage of the pesticides. For analyzing the in vivo effects, epidemiological studies were conducted in pesticide exposed agricultural workers. The 200 exposed volunteers suffered from fever, nausea, headache and other abnormal symptoms and visited the hospital for general health check-up. These cases were taken up for more detailed studies. Five of them (2.5%) showed decrease in RBC, haemoglobin, and increase in WBC with a large number of immature cells. These volunteers were further diagnosed as Philadelphia negative Chronic Myeloid Leukemia (CML) cases based on clinical and pathological examinations. In similar environs, about 3% of the exposed children showed signs of mental retardation and delayed milestones. It is therefore, concluded that clinical evaluations supported by occupational epidemiology could determine CML in exposed individuals (adults). At low doses we have traced the effect of pesticides at molecular level.

Synthetic flavourings are frequently shunned by customers who believe that hese compounds are harmful or pose a health risk to them. (Teixeira et al., 2004). The association between flavour stability and food quality and acceptance has piqued researchers' interest, yet it's tough to control. Food manufacturing and storage procedures, packaging materials, and ingredients frequently alter overall flavour by lowering the intensity of aroma compounds or introducing off-flavor components (Lubbers et al.,1998). Because there are so many variables in flavours, they constitute extremely complicated systems. Some are more stable in water soluble carbohydrates, whereas others are more stable in lipid-based coatings. Physico-chemical characteristics, concentration, and interactions of volatile aroma molecules with food components are just a few of the aspects that determine the overall quality of the food. It's a good idea to encapsulate volatile components before using them in foods or beverages to prevent fragrance degradation or loss during processing and storage. Encapsulation is the process of coating or encasing one material or a mixture of components into another material or system. The coating substance is known as shell, wall material, carrier, or encapsulant, and the coated material is known as active or core material.

Industry 4.0 is essentially the digital revolution of artificial intelligence and subsequent production processes utilizing contemporary smart technology. Cyber-physical systems, or intelligent machines, are the cornerstone of this revolution (Scoop, 2018). The key features of Industry 4.0 include the integration of IoT, increasing automation technology, and enhanced communication and self-counseling techniques (Tay et al., 2018). According to Schwab (2017), new developments in artificial intelligence (AI), robotics, nanotechnology, biotechnology, the Internet of Things (IoT), decentralized systems, 3D printing, fifth-generation communication technologies, quantum computing, and autonomous cars will all be part of this revolution. Early in the 2010s, Germany saw the emergence of Industry 4.0 as a result of government initiatives to advance manufacturing computerization as part of its high-tech strategy project. The concept of Industry 4.0 has been implemented in a variety of contexts and rebranded by various industries or businesses as needed.

Food is defined as any substance, whether processed, semi processed or raw, that is intended for human consumption as well as the inedible parts associated with food that are not intended to be consumed by humans. Food waste is defined as any food and inedible parts of food, removed from the food supply chain that can be recovered or disposed, whereas, food loss is defined as food that unintentionally undergoes deterioration in quality or quantity as a result of food spills, spoils, bruising, wilting or other damages alike owing to infrastructure limitations at the production, storage, processing and distribution stages of food lifecycle. Global food waste management is an issue of concern that requires attention from various stakeholders having diverse expertise. According to statistics, about one third of the food produced for human consumption is either lost or wasted. Globally, the cost of food waste accounts for USD 2.6 trillion, of that USD 1trillion is incurred from greenhouse gas (GHG) emissions, water scarcity, biodiversity loss, increased conflicts and loss of livelihood owing to issues like soil erosion, nutrient loss, reduced yields, wind erosion and pesticide exposure.

The landscape gardening for aesthetic appreciation is an integral part of the progress achieved through the growing world floriculture business that has reached a $ 40 billion mark and valueless aesthetic emotional gains. The industry is continuously rising through transitional changes to have more accepted and unique applications as a wide and economic choice to the consumers with regards to the energy saving in the system. The use of energy for sustenance of the landscape plants before and after planting can be a benchmark in time to come as no one can believe that the plants instead can grow with still better traits either be it the foliage colour, variegation, shape, size and or form beside the fact that the consumption of such altered/compact plants has increased manifold in house, gardens, parks and indoors with a large number of products worldwide in a eco-friendly manner.

At the same time there is great environmental consciousness towards transforming landscape gardening with more natural and unspoiled system of growing plants and maintaining them in the landscape as perennial ones. The system being independent of distance of use or application offers an ease of transport into a mass for large-scale uniform planting. This is the fact that in the recent times, the commercial growers do not rely on the nature to introduce the genetic mutation that will make them millionaires but depends on the art and scientific knowhow to create a novelty in its own. This has resulted in the seriousness and painstaking effort of the growers to produce the plants round the year in new forms and shapes to put forward a new plant with extra-ordinary marketable characteristics every year, e.g. compact chrysanthemum, kalanchoe, bromeliads, orchids, etc are some of the common products with an unusual and eye-catching hue in the auction markets. Similarly, a large number of annual and perennial plants perfectly suited for various kind of landscaping, slope, soil types and moisture regimes under the specific and artificial environment created for a specific growth of the plant.

Sweet pepper or bell pepper, a cultivar group of the species Capsicum annuum under the family Solanaceae (Chromosome No. 2n =2x =24) is grown worldwide as green vegetable for its thick and fleshy fruits having delicate taste, pleasant flavour and colour. Sweet pepper requires slightly cooler climate than hot chillies. The fruits are generally non-pungent hence, it is commonly known as sweet pepper. It is also popular as bell pepper because of blocky fruit shape. China is the largest producer of sweet pepper in the world.
Origin, domestication and adaptation in India
Hot chillies and sweet pepper have originated from the wild and weedy species Capsicum annuum var. minimum whose domestication occurred in Mexico and distributed from the southern United states to northern south America. Domestication, cultivation and human selection brought about changes in fruit size and shape and fruit position from erect to pendant. It also resulted in more self-pollinating character due to inserted stigma unlike the exserted stigma in the wild types.

Nano-materials are to be extensively studied and characterized prior to their application in material science, biological science, electrical and electronics. In addition to the basic physical properties of the nano-materials, other characteristics such as paramagnetism, ferromagnetism, supermagnetism, optical properties, quantum size effects and electrical properties have to be studied. With a view to provide the fundamental information on these aspects this chapter is dedicated.

Abstract

Drying is a very important unit operation in food processing. Being an energy intensive unit operation, drying process demands improvement to make it energy efficient. Beside this operating conditions used in drying affect product quality substantially; however, traditional dryers do not allow enough flexibility to meet quality requirements for several products. This has resulted in development of number of new drying techniques, to cope with both energy efficiency and product quality.
