INTRODUCTION

Food processing is necessary for the conversion of raw food products in to finished products with desired textural, sensory and nutritional attributes. This is required to be done mainly due to seasonal production and facilitating non-seasonal availability of different commodities. Stages of processing are primary and secondary. In primary processing raw material is converted into food commodities, while in secondary processing commodities are converted into edible products. Processing is mainly done to convert the products into edible forms, to extend shelf life, availability, accessibility and also to provide variety into the form of value added products. Processing of products destroys inhibitors, microorganisms, retards physico-chemical and biochemical deterioration, maintains good sensory properties, preserves and enhances the nutritive value. Unit operations involve phase changes and sometimes chemical reactions also, which are undesirable as they cause inferior quality of the product (Gekas 1992). Different processes like separation, assembly, preservation and packaging are broader classification for unit operations in food processing (Saravacos and Kostaropoulos 2002).

2.1 Gender Analysis

Inequalities between men and women are becoming more visible and glaring particularly in developing countries of the world triggering serious concern over developed experts. UNESCO statistics reveals that women perform 75 per cent of work, earn 10 per cent of the income and own 1 per cent of property. The 3rd UN Millennium Development Goal (MDG) has called for gender equality and the components of women to battle poverty, hunger and disease and to restorative development that is precisely sustainable.

The Beijing Platform for Action (1995) very well support this fact in form of twelve objectives and action points viz., women and poverty, education and training for women, women and health, violence against women and armed conflicts, women and the economy, women in power and decision making, institutional mechanism for the development of women, human rights of women, women and media, women and environment, and the girl child. Prior to the above declaration there were First, Second and Third World Conference on Women at Mexico (1975), Copenhagen (1980) and Nairobi (1985), respectively.

6.1 Introduction

The change in climatic factors over the years is affecting the entire ecosystem. According to Intergovernmental Panel on Climate Change (2007), the global surface temperature is predicted to increase between 1.4 and 5.8 ^oC by the year 2100. Microbial and plant metabolic processes are often dependent on environmental factors (for e.g. temperature and moisture), enzyme activity, and nutrient availability all of which are likely to be affected by climate change (IPCC, 2007). The global atmospheric concentration of carbon dioxide, an important greenhouse gas (GHG) largely responsible for global warming, has increased from a pre-industrial value of about 280 ppm to 389 ppm at present. Similarly, the global atmospheric concentration of other important GHGs like methane and nitrous oxides has also increased considerably. The increase in GHGs was 70% between 1970 and 2004.

Rising atmospheric CO₂ is able to change the physiological activities of plants and soil micro organisms which in turn control the flow of carbon (C) and nitrogen (N) in terrestrial ecosystems. The change in climatic factors also alters the beneficial plant-microbe interactions, which may be positive, negative, neutral or having variable effects. The survival and activity of microorganisms in the rhizosphere mainly depend on the flow of carbon in the root exudates. The composition of these root exudates is affected by various environmental factors such as soil type, pH, light intensity, oxygen status, soil temperature, soil moisture and nutrient availability. Diverse microbial activities pose a major challenge to predict the response of microbial community to global climate change. These changes in microbial activity have larger impacts on vital ecological processes such as nutrient cycling.

Horticultural medicinal plants

Throughout recorded history, people have held medicinal plants in high regard due to the many health benefits they provide. Natural cures abound among these botanical marvels, and they may alleviate a wide range of health problems. The wide variety of bioactive substances found in them has been used to create pharmaceutical medications and alternative treatments, suggesting that they may have curative properties. Medicinal plants, such as aloe vera and turmeric, offer a wide range of uses, including pain relief, the treatment of chronic diseases, and general health improvement. A newfound respect for traditional herbal medicine’s knowledge and the need of preserving these priceless resources has emerged in recent years, as contemporary medicine investigates the plants’ unrealized potential.

The fast-changing world has put a vast amount of pressure on the energy system [1]. That has resulted in a sudden increase in global energy consumption. For several centuries fossil fuels have been the bedrock of energy generation, powering industries, households, and transportation. Apart from this mounting evidence of climate change has been characterized by rising global temperatures, extreme weather conditions and rise in the sea level are been directly linked to the emissions generated by the combustion of these fossil fuels. The harmful effect of the greenhouse gases on the environment has impacted globally. We strongly need much safer and more sustainable energy sources. In addition, the main reason behind international relations instability is often linked with the fossil fuel-dependent economies, coupled with the finite nature of such resources, which has underscored the requirement of diversifying the energy mix. Biochar an alternatives to fossil fuels emerging as carbon-rich material produced by heating biomass in anaerobic conditions this product is known as pyrolysis [2]. This substance has the potential that be derived from a variety of biomass waste streams, including animal excreta, food scraps, forestry residues municipal solid waste, and agriculture by-products. Transforming organic waste into stable, carbon-rich products, biochar offers a dual benefit that addresses waste management challenges while contributing to carbon storage. Biochar is a versatile material that has exceptional properties that make it a promising alternative for addressing various environmental and energy challenges [3]. It has unique characteristics that include high porosity, creating a network of interconnected pores that enhance its surface area and reactivity, functional groups that enables biochar to react with a wide variety of substances. The substantial surface area provides ample sites for adsorption a process where pollutants bind to the biochar surface. The material high cation exchange capacity allows it to retain essential nutrients by preventing their leaching and helping in enhancing soil fertility [4]. However, biochar has remarkable stability providing resistant degradation and persisting in the environment for extended periods, making it an effective carbon sequestration tool. The economic benefits of biochar are equally persuasive, as it can be produced from low cost readily available biomass waste thereby reducing waste disposal costs. Furthermore, the process of creating biochar is really simple and effective for the environment and contributes to the overall appeal. There are several studies have underscored biochar’s effectiveness in removing pollutants from water spills [5]. To produce biochar there are several thermochemical conversion techniques are been employed, including torrefaction, gasification, flash carbonization, pyrolysis, and hydrothermal carbonization. among this pyrolysis is the most prevalent method. This process involves biomass heating without oxygen that results in organic matter decomposition and the formation of biochar and bio-oil. Pyrolysis is done under a state of low oxygen, where the biomass is degraded the biomass type, residence time, and thermal efficiency at a given temperature, heating, and feedstock type impact the item formed in due process. The fundamental characteristics and structure of biochar also depend upon the kind of reactor used in the carbonization process [6] organic material synthesized through pyrolysis of different biomass (plant or animal waste. Currently available technologies for characterizing biochar include nuclear magnetic resonance (NMR), Raman spectroscopy, Braeuer Emmett Teller (BET), X-ray diffraction (XRD), Fourier Transform Infrared Spectroscopy (FTIR), Thermos Gravimetric Analysis (TGA), and Scanning Electron Microscopy (SEM) [7,8]. ABSTRACT
Methanogens are primarily anaerobic Archaebacteria representing the most primitive earthly creatures, alive since about 3.5 billion years. While oxygen inhibit their activity, they adapt well in a variety of ecological niche, viz., the intestinal tracts of insects and animals including ruminants, sewage digesters, groundwater and deep soil/water, etc. They are involved in biomethanation that converts organic polymers, including the complex recalcitrant lignocelluloses, to CH₄ and CO₂. Enhancing the process by optimising the physical, chemical and molecular parameters is an interesting biotechnology. Molecular research is rapidly progressing on the genomics, gene and its regulation, and methanogenesis as it expresses. Identifying novel species expressing methanogenesis and manipulating the genetic make-up including through cloning in recent years will set goals and leads for future investigations. The biomethanation enzyme Methyl-CoM-reductase (Mcr) constitutes about 10% of the methanogen protein. Due to its abundance and significance, elucidating its structure and its synthesis and regulation mechanism has received much attention recently. Mcr-coding genes from methanogens have been cloned and sequenced. An approach at the molecular level to enhance biomethanation seems to lie in metagenomics. The microbiology, biochemistry, the roles of the participating microbes, their molecular biology and applications in methanogenesis are discussed in this chapter.

1. INTRODUCTION

The basic principle of plant breeding is the utilization of existing variation and creation of new variations. Ploidy breeding is one of the tools used for improving the crop plants. The year 1937 can be considered as a landmark in the history of plant breeding. The discovery of the specific action of colchicine in inducing polyploidy has provided the breeder with a means for increasing the scope of crop improvement apart from the removal of the barrier of sterility in the sterile interspecific hybrids by the production of amphidiploids and their utilization later for the transfer of useful genes from the wild parents to cultivated plants. It was hoped that the production of autoploids in various crop plants would directly lead to the cultivation of better plants, as generally the autopolyploids are known for their gigas characters including the seed.

8.1 Introduction

Earth’s temperature has increased significantly due to the rise in concentration of greenhouse gases in its atmosphere. Naturally occurring greenhouse gases include water vapour (H₂O), carbon dioxide (CO₂), methane (CH₄), nitrous oxide (N₂O) and ozone (O₃). Prior to industrial revolution, the amount of greenhouse gases released into the atmosphere matched what could be absorbed by the natural sinks. Industrialization catapulted the addition of anthropogenically emitted gases to the environment, much beyond the natural levels. These greenhouse gases are building up, thus creating the effect of ‘global warming’. Global warming is a consequence of two major phenomena - depletion of the ozone layer and increase in greenhouse gas emission (Ishler, 2008).

Introduction

Meat derived from animals are subjected to various contaminations from number of sources. The animal itself is a major contributor of both pathogenic and spoilage organisms. Further contamination may be introduced from water used, equipment used for product preparation, from the meat handlers and the surrounding environment. Microbiological problems such as food poisoning or spoilage may arise when the desired effect is not achieved and is usually due to errors in the handling or processing procedures. The detection and rapid correction of such errors and their future prevention is a major objective of any quality control system.

In traditional approach to meat and meat product quality control system, only the samples of the final product were analyzed by laboratory test to check for compliance with specifications. However, the responsibility for control of hazards rests with individuals involved in all stages from farm to ultimate consumer. And the control of hazards at each stages of food chain may be achieved by Hazard Analysis Critical control point (HACCP). Hazard analysis critical control point is an internationally recognized system that helps to ensure the manufacture of safe food products. HACCP is not a zero risk system but rather a system designated to minimize the risk of food safety hazards. HACCP concept is a systematic and rational approach Firstly by consideration of the hazards i.e., microorganisms or their toxins, that need to be controlled in a specific operation by structured hazard analysis and secondly on the identification of the most effective means of controlling the identified hazards. This system, by focusing attention on the factor that directly affects the microbiological safety and quality of meat foods, eliminates wasteful use of resources and superfluous consideration. As a consequence, the cost/benefit relationships are more favorable. The system is applicable at all levels of meat food chain from farm production through processing, transporting, merchandising and ultimate use in the meat food service establishment or at home. Ensuring food safety and quality is the responsibility of all links in the food chain. Now a day’s food consumers are very much health conscious and they want their food to be safe and of good quality. As meat being highly perishable and high risk food product, it is very much imperative on the part of meat and meat products producers and exporters to produce safe and quality meat to stand in the competitive world and further hygienic meat processing is important not only to provide safe and wholesome meat but to provide a good public image and to increase consumer demand.

Thinking about the plant’s requirements, growth habits, and intended results is essential in this horticulture discipline. Pruning is an essential tool in arboriculture, gardening, and agriculture; its use varies from plant to plant and from purpose to goal, from encouraging strong development to improving the plant’s aesthetic appeal. In the grand scheme of things, pruning is a deliberate action taken to improve the health and productivity of plants in their natural habitats.

INTRODUCTION

Papaya (Carica papaya L.) is known as wonder fruit of the tropics. It is unique plant, which produces fruits throughout the year. It owes its popularity due to various reasons, i.e., requires less area per tree, comes to bearing in a year, easy to cultivate and has high nutritive and medicinal value. Papaya is an ideal fruit for growing in kitchen gardens, backyard of homes as well as in orchards, especially those near the cities or big towns. India ranks first in production of Papaya in the world with share of 31% of the total production. Its productivity is highest (43.70 t/ha) among the fruits grown in. It is also  India. It is famous intercrop due to its small stature, short life cycle, precocious in bearing and grown extensively as a filler crop in orchards.
 
Papaya is quick growing, bearing fruits within 8-10 months of transplanting and giving yield in same year. Fast growth with high photosynthetic rate, reproductive precocity, low production cost and more output characterize the uniqueness of this fruit. Now a day, the area under this crop is growing rapidly due to its higher productivity. Indeed, papaya cultivation is very profitable if done on modern lines. Demand for its fruits is growing in domestic as well as export markets and require modern technological interventions for commercial exploitation of these fruits. A ready market for its fruits becomes a big bonus for growers. Immediate availability of a selling point and a good price from a buyer encourage the farmers to grow more papaya crop.

Agriculture is the predominant sector in the economy of Jammu and Kashmir. Directly and indirectly, it supports about 80 per cent of the population besides contributing nearly 60 per cent of the state revenue. The total geographical area of the state is nearly 22.2 million hectare and population of 12.5 million, which is approximately 1.04% of the national total. The J&K is divided into three agro-climatic zones: Cold arid desert areas of Ladakh, temperate Kashmir Valley and the humid sub-tropical region of Jammu. Each has its own specific geo-climatic condition which determines the cropping pattern and productivity profile.

In Jammu province, a small portion of the land lies in the plains along the borders of Punjab while the rest of the area is hilly, dominates both in maize and wheat production. About 67 per cent of the area is under maize and wheat production with the production of 21.25q/ha maize and 15.36 q/ha wheat. This region contributes 79.56 per cent and 95.69 per cent of total production of these two cereals respectively. Even though the yield is not high, the region makes appreciable contribution to the cereals production.

The second agro-climatic zone Kashmir is also known as ‘cultivator’s paradise’. The region practically depends on irrigation, which is easily available. A large area of level land has alluvial soil. Extensive elevated plateaus of the alluvial or lacustrine material (locally called Karewas) also exist in the Kashmir valley. These Karewas are productive only in the face of sufficient rainfall or adequate irrigation facilities. Rice is the chief crop of this zone, followed by maize, oat, barley and wheat.

Ladakh zone is endowed with bare rocky mountains and bare gravel slopes. Villages are located near pockets of land with level ground and irrigation facilities, where cultivation is viable. In this region, barley is the major cereal crop followed by summer wheat. Millets and wheat rank second in importance and are grown in the warmer belt of the region.

Wheat Production and Consumption

Wheat, rice, maize, barley, sorghum and the millets are the main crops that provide nutrition to people worldwide. The production of grains in different countries depends on the various factors such as water availability, soil conditions, temperature, cultural and economical are most critical factors. Nutritional needs of the developing countries are more dependent on cereal grains compared to the developed ones. Approximately 60% of the calorie requirements in the developing countries are met from cereals. The International Grains Council (IGC) forecasted for total grains production in 2017-18 to 2.079 billion tonnes. There is a need to have major research to increase their productivity, reduce storage losses, enhance efficiency of processing and to ensure food safety in the entire supply chain. Among them, wheat is one of the most important crop species and is a staple food for about 35% of the world population. Wheat is unique among the grains because of its protein type, which when mixed with the water by mechanical forces yields into viscoelastic dough due to the formation of gluten. This unique property of dough is capable of retaining the gases which are produced by yeast or baking powder resulting in the production of an array of leavened products such as bread, cookie and cake.

Wheat is also an important source of dietary proteins for humans but like other cereals, it is deficient in the essential amino acid lysine. Wheat crop is adaptable to the wide range of growth conditions compared to other major cereals and hence it is cultivated widely throughout the world. Wheat cereal is the major dominating staple in the North Africa, Central and West Asia, providing the 50% of the calorie requirement in the region. The world wheat production is 740 million tonnes, with China ranking first by producing 125 million tonnes of wheat annually. Other major wheat producing countries are India, USA, Russia Australia, France and Canada. The global per capita consumption of wheat is about 66 kg, which varies widely in different regions. In Algeria, Egypt, Israel and other Middle East as well as Eastern Europe the consumption of wheat flour is high (150 kg/year). The food uses of wheat in developing countries are more than 80%, while in developed countries it is less than 50%. The consumption of the wheat in developing countries is significantly increasing due to globalization and growing economies. After rice, wheat is a major cereal crop in India and contributes to more than 50% of the total calories. It is grown in the cooler regions of India during the period of November to April. In grain production, rice ranks first with the production of about 105 million tonnes per year. In India, total grain production is 136 million tonnes for the year 2016-17 as per the International Grains Council. India ranks second in the production of wheat in the world and produce about 95 million tonnes annually. The bread wheat (astevum) contributes to approximately 94% while durum wheat is 4% and dicoccum wheat accounts to 2%.

There have been lots of international efforts to establish crop based research centres primarily in the developing/under-developed countries to carry out concerted breeding and plant genetic resources management activities pooling germplasm from all over the world and also engaging scientists from different countries to do breeding work on the certain mandate crops of the particular region using all kinds of germplasm and technologies with strong financial support from a central agency known as Consultative Group on International Agricultural Research (CGIAR) for doing the stipulated work as per programme and deliver the products which can be used by different national plant breeding programmes either to use them directly as cultivars or to use them in their breeding programmes in various ways including parents in the crossing programme.

CGIAR System Organization headquartered in Montpellier, France is a global agricultural research partnership for a food secure future that was founded in the 1970s in response to the Green Revolution. There are presently 15 CGIAR agricultural research centres employing more than 8,500 researchers and support staff worldwide, with an annual budget of US$ 800 million.

CGIAR is a global research partnership for a food-secure future. CGIAR science is dedicated to reducing poverty, enhancing food and nutrition security, and improving natural resources and ecosystem services. Its research is carried out by 15 CGIAR Research Centers in close collaboration with hundreds of partners, including national and regional research institutes, civil society organizations, academia, development organizations and the private sector. The CGIAR Fund was established as a Financial Intermediary Fund (FIF) in 2010. It was subsequently closed and replaced by a new FIF in 2017, following the CGIAR System governance reorganization.

Millets have immense potential of providing nutritional security worldwide and play a pivotal role in food and nutrition economy. The nutritional aspects of millets are comparatively superior from the widely consumed cereals across the globe. With the presence of various essential macro nutrients millets are also enriched with the goodness of micro nutrients as minerals, vitamins and possess various bioactive compounds that portray several health benefits. The nutritional attributes of the millets are accompanied with several antinutritional factors such as tannins, phytates, saponins, trypsin and amylase inhibitors etc. that limit the bioavailability of the essential nutrients and minerals in these wonder grains upon consumption.

INTRODUCTION

Sapota [Manilkara zapota (L) P. Royen] commonly known as chiku in India, is an exotic fruit crop originated in Tropical America. The name sapodilla is derived from the Spanish word zapotilla, meaning “small sapote.” Tree have dark green beautiful radiating canopy with central flag having aesthetic values.It is a popular crop widely cultivated in most tropical countries. The cultivation of sapota is a profitable venture as it does not need much spraying, pruning and it is a long-life fruit tree. Moreover, the fruit fetches good price in market as it ripens in April and May in North India, when mango and litchi fruits are scarce. At international level in India crop attained an important place in fruit industry. In India this fruit species is cultivated only for its delicious fruit for table purpose but in South America, it is cultivated for chickle the “gutta parcha” which is used as base material for chewing gum.This is extracted from bark. Sapota fruit present a climacteric behavior. In India farmer from Bordi village near Gholwad, late Sri Gopal Rao Patil realized the commercial potential of this evergreen and ever fruiting tree and procured a few plants and began to propagate for distribution among poor farmers of this area and within short time it had spread from Palghar in Maharashtra to Amalsad in Gujarat. Subsequently commercial cultivation in his region was helped by lranis and Marwari settlers. The best sapota orchards in this area belong to lranis and Marwaris. It is from this area that this fruit went to various other parts of the country like Andhra Pradesh, Tamil Nadu, and Karnataka, Punjab and Haryana etc. In India crop become very popular among farmers as a cash crop. There is a possibility of extending cultivation of this crop into warm and humid climate of all tropical regions of the world. In India area under this crop increasing every year. Therefore, in recent years, it has attained the status of major fruit in peninsular India. Popularity of this fruit is on increase due to high production per unit area and continuous fruiting throught out the year.

1. Introduction Ayurvedic texts like Charak Samhita and Sushruta Samhita, have described millets as the staple food useful in managing diabetes mellitus (Sachan Kumar, 2004). Based on the experience of eating these millets for time immemorial, there exists also a strong traditional knowledge about health benefits associated with them. For example, as per an adage in the state of Karnataka, India: “Those who eat rice will grow as a light weight; their body being just like that of a bird; those who eat Jowar will become as strong as a wolf but those who eat Ragi (millets) will be the strongest of them all, plus they would be free from illness (‘nirogi’ in Sanskrit)”! Certain studies from literature refer nutraceutical character of millets, especially, Kodo and Kutki, which in our opinion should help mankind in eradicating malnutrition and hunger while ensuring sustainable supply of food.

ABSTRACT
Rice straw is one of the most abundant lignocellulosic agricultural wastes in India and can be used as a major resource for biogas production. The structure of rice straw is complex and is made up mainly of cellulose, hemicelluloses and lignin. The lignin physically shields the cellulose and hemicelluloses, the main components which can be converted to energy, and hinders the access of microbial enzymes to these carbohydrate moieties. To overcome this making the straw a potential resource of biogas production, effective pretreatment is necessary that can efficiently hydrolyse the straw and make it accessible to cellulolytic enzymes and methanogens. Various pretreatment methods which are employed currently in the market are discussed here. For a process to be economically feasible it is necessary that the pretreatment be efficient as well as cost effective. To gain some insights into this aspect, the techno-commercial feasibility of Biomethanation of rice straw has been discussed.
