Flood diversion redirects part or all of an excessive flow away from a vulnerable river reach, settlement, or agricultural area. Water may be conveyed through diversion channels, floodways, canals, tunnels, spillways, or natural depressions and discharged into another river, reservoir, wetland, or safe storage area. A diversion scheme must have sufficient capacity and a dependable control structure while avoiding unacceptable flooding, erosion, sediment deposition, or environmental damage elsewhere. This chapter explains the purpose, principles, and methods of flood diversion. It covers site selection, diversion routes, hydraulic and structural components, design discharge, operational requirements, advantages, limitations, maintenance needs, and the role of diversions within integrated basin-level flood-control planning.

Flood estimation determines the probable magnitude and frequency of flood events for designing hydraulic structures and managing flood risk. Intense rainfall over a catchment generates excess water after interception, infiltration, evaporation, and depression storage have been satisfied. This runoff reaches the drainage system and may cause flooding when channel capacity is inadequate. Reliable estimates help engineers select suitable dimensions for dams, spillways, bridges, culverts, reservoirs, and other protective works. This chapter describes rainfall-based and streamflow-based estimation techniques, including the Rational and Cook’s methods, unit-hydrograph procedures, frequency distributions, Gumbel, log-normal and Log-Pearson Type III analyses, empirical formulae, flow-mass curves, and partial-duration series.

Hydrology examines the occurrence, circulation, distribution, and properties of water in the atmosphere and on Earth. Solar energy drives the hydrologic cycle through evaporation, condensation, precipitation, infiltration, runoff, and groundwater movement. Rainfall first satisfies interception, depression storage, evaporation, and infiltration before excess water begins flowing across the surface and into channels. When runoff entering a river exceeds its conveyance capacity, flooding may occur. This chapter explains clouds, precipitation measurement, rain-gauge networks, rainfall consistency, infiltration, runoff mechanisms, hydrographs, unit hydrographs, empirical runoff models, and stage-discharge relationships. These concepts provide the scientific foundation required for analysing floods and designing appropriate control measures.

Flood management is a continuing process of assessing flood risk and coordinating prevention, preparedness, response, recovery, and adaptation. Unlike flood control, which often emphasizes physical structures, integrated flood management accepts that floods cannot always be eliminated and seeks to balance their risks and beneficial functions. It protects life and property while considering river-basin development, environmental sustainability, social needs, and economic feasibility. This chapter explains flood-management concepts, objectives, purposes, and techniques. It discusses structural and non-structural actions, forecasting, watershed treatment, afforestation, rainwater harvesting, floodplain zoning, community preparedness, institutional responsibilities, interlinking proposals, and government programmes. Emphasis is placed on coordinated, basin-wide and risk-informed decision-making.

Flood routing predicts how a flood hydrograph changes as it passes through a river reach or reservoir. Storage, channel geometry, friction, inflow distribution, and outlet conditions generally reduce, delay, or otherwise modify the flood peak. Routing results help forecast downstream water levels, determine reservoir releases, design spillways and channels, issue warnings, and evaluate flood-control alternatives. This chapter introduces the continuity and storage principles underlying flood routing and distinguishes reservoir routing from channel routing. It discusses hydrologic and hydraulic approaches, including level-pool, Muskingum, and related techniques. Attention is also given to inflow and outflow hydrographs, routing coefficients, travel time, attenuation, data requirements, assumptions, calculations, and practical engineering applications.

9.1 Introduction

Flood water which is in the form of a hydrograph when passes down a river section undergoes several changes in its form. There may be some addition of water to the river section when the flood wave passes down the river section. There may be some diversion of water from the section. Thus, depending on the addition or abstraction of water to the incoming flood water, shape of the flood hydrograph in the downstream section may change. Sometimes channel storage and resistance to flow of water in the channel section also affects the shape of the flood hydrograph.

A flood occurs when water exceeds the carrying capacity of a river, stream, drain, gully, or another natural or artificial channel and spreads over adjoining land. Its severity depends on water volume, depth, velocity, duration, timing, and the vulnerability of affected communities. Prolonged inundation can severely damage crops, property, infrastructure, water supplies, and human and animal life. Night-time floods may be particularly dangerous because warnings and evacuation become difficult. This chapter introduces flood occurrence and mechanisms, India’s and the world’s flood history, flood-prone regions, flood types and causes, major consequences, and the responsibilities of Indian flood-control and forecasting agencies.

7.1 Introduction

Flood is an unusually high stage in a river resulted due to high rainfall or snow melt which causes large flow of runoff in it. During flood, the river overflows the banks and inundates the adjoining areas. Flood causes heavy damages to buildings and hydraulic structures besides causing catastrophic loss to human life and property. It causes great economic loss due to disruption of many structures and damage to agricultural fields. Many forest and aquatic lives are affected by the flood. Hundreds of crores of rupees are spent every year to control, forecast and manage the flood.

Flooding

Flooding affects both above and below ground ecosystem processes in greenhouses. Below-ground changes may be less obvious, they are as important as the above-ground changes. Soil microorganisms are sensitive to disturbance, and shifts in soil microbial community structure are expected when anaerobic conditions develop from flooding. The useful aerobic microbes are destroyed by flooding. It takes time to built-up their population in the soil to benefit plants. Due to anaerobic condition created by flooding in greenhouse plant roots in soil are not able to breath, function and hence wilting of plants occurs. Flood irrigation in excess create flood like condition in greenhouses at time. Excess water in soils is a major factor affecting plant survival and functioning. In saturated soils, the supply of atmospheric oxygen into the soil is curtailed and various facultative and obligate anaerobic microorganisms use oxidized compounds as electron acceptors for respiration, thus converting them to reduced forms. The reduction and the associated processes influence plant survival, growth and functioning in wetlands. Flood irrigation should always be just wet the soil not flood inviting stagnation of water.

A chain of reactions is initiated upon soil flooding leading to reduced soil redox potential conditions. These reactions include physical, chemical and biological processes that have significant implications on plants growth. Physical processes include restriction of atmospheric gas diffusion in the soil leading to depletion of soil oxygen and accumulation of carbon dioxide. Shortly after flooding, the limited supply of oxygen in soil pore spaces is depleted rapidly by roots, microorganisms, and soil reductants. This process leads to oxygen depletion and reduction in soil oxidation reduction potential followed by a chain of soil chemical changes. The processes that follow include denitrification, reduction of iron, manganese and sulphate, and changing soil pH

Abstract

The anomalies observed in the reverine systems have been demonstrated to be the potential tool in deciphering the tectonically active zones. Such various drainage anomalies viz: radial drainages, anomalous compressed meanders, eyed drainage and the youthful floodplains observed in Annamali – Palani - Varushanad hill ranges of the Western Ghats of Tamil Nadu show that the N-S and NE-SW trending faults are tectonically active in the recent years.

Introduction
 
Arid western part of Rajasthan which contains the Indian segment of the Thar Desert, accounts for ~62% of the country’s hot arid area and is a region of low rainfall. Under such physico-climatic situation, fluvial processes function much less frequently and more episodically than the aeolian processes, but their impacts on landforms and society are large, as noticed on several occasions in arid regions. There is a distinct east-west gradient of rainfall and temperature in the region. Along the eastern margin bordering Aravallies, the mean annual rainfall is 500 mm while in the westernmost part at Jaisalmer, it is less than 150 mm. The rainfall is largely monsoon driven which brings 80 - 90 per cent of total rainfall received during the year. There is large inter-annual rainfall variability of rainfall which leads to climatic extremes of drought and floods of different magnitudes. For example on an average, the Thar Desert in India experiences flood-causing rainfall in 2-3 years in a decade, but a maximum of 5 flood causing rainfall years in a decade was recorded during the 1950s, 1970s and the 1990s (Rao et al. 2006).

Water vapour changes to the liquid water through condensation process. Condensation is the direct cause of the various forms of precipitation. It occurs as a result of changes in air volume, temperature, pressure or humidity. Water vapour can also be converted directly into the solid form through a process called sublimation. The latent heat expended in evaporation is liberated in the process of condensation. Four mechanisms may lead to condensation.

Abstract

We are very fortunate to be born in a nation which is blessed with awesome decent variety of natural products, fruits, vegetables, cereals, pulses and so forth. The population of India expanded consistentlythat cause a genuine sustenance and shelter problem. The supply of food is not adequate to fulfill the demand of the consumers. This shortage of food is the root for adulteration of foodstuffs by the traders. Food adulteration is a procedure in which the nature of sustenance is brought down either by the addition of inferior quality material or by extraction of valuable ingredient. An adulterant is a chemical substance which should not be contained within other substances (food, beverages) for legal or other reasons. The addition of adulterants is called adulteration. Food is adulterated to increase the quantity and make more profit. The food is sucked of its nutrients and the place where the food is grown is often contaminated. For instance: milkis mixed with water. Vanaspati is utilized as an adulterant for ghee. Adulteration of food is unsafe as it may be toxic and causes serious health hazards to the consumer. To evade this issue government has passed an act which is known as preservation of Food Adulteration Act. It covers security from risks involved due to contamination of poisonous elements. Instead of government efforts the informed and aware consumers will have the capacity to dispense with this issue. So, here in the chapter adulterants their types, effect on human health, laws and control measurement were reviewed and discussed.

1. Guidelines on Analytical Terminology

    1.    Accuracy : The closeness of agreement between a test result or measurement result and a reference value.

    2.    Analyte : The chemical substance sought or determined in a sample. This definition does not apply to molecular biological analytical methods.

    3.    Applicability : The analytes, matrices, and concentrations for which a method of analysis may be used satisfactorily.

    4.    Bias : The difference between the expectation of the test result or measurement result and the true value. In practice conventional quantity value can be substituted for true value.

    5.    The bias of a measuring instrument is normally estimated by averaging the error of indication over the appropriate number of repeated measurements. The error of indication is the: “indication of a measuring instrument minus a true value of the corresponding input quantity”.

    6.    Calibration : Operation that, under specified conditions, in a first step, establishes a relation between the values with measurement uncertainties provided by measurement standards and corresponding indications with associated measurement uncertainties and in a second step uses this information to establish a relation for obtaining a measurement result from an indication.

    7.    Certified reference material (CRM) : Reference material accompanied by documentation issued by an authoritative body and providing one or more specified property values with associated uncertainties and traceability, using valid procedures.

Food and Industrial Microbiology

Ice cream is not only an indulgent frozen dessert but also a food containing several nutrients derived from milk, cream, sugars, and other ingredients. This chapter examines ice cream from a nutritional and food-science perspective, focusing on its major nutritional components and energy contribution. It discusses milk fat, proteins, lactose, carbohydrates, minerals, vitamins, and the nutritional effects of formulation. The chapter also considers energy value, portion size, digestibility, and palatability. Understanding these factors helps explain why ice cream provides both nutritional and sensory value. The discussion provides a balanced foundation for evaluating ice cream as part of varied diets and developing products for different consumer requirements.

Food Packaging

    1.    Food packaging : A wrap, pouch, bag, box, cup, tray, can, tube, bottle and jar are some of the many forms of packaging that contain food products. It must contain a food product as well as protect and preserve it for a specific length of time. Each package must, by law, display product information for the consumer.

    2.    Low Density Polyethylene (LDPE) is an economical material with low WVTR; however, it has high permeabilities to flavours/volatiles, poor grease resistance and are limp.
 
    3.    High-Density Polyethylene (HDPE) is stiffer, more translucent and has better barrier properties but needs higher temperature for sealing.

    4.    A copolymer of polyethylene and poly vinyl alcohol, and EVOH has outstanding gas barrier properties especially when dry.

    5.    High-density polyethylene is stiff, strong, tough, resistant to chemicals and moisture, permeable to gas, easy to process, and easy to form. It is used to make bottles for milk, juice, and water; cereal box liners; margarine tubs; and grocery, trash, and retail bags.

    6.    Low-density polyethylene is flexible, strong, tough, easy to seal, and resistant to moisture. Because low-density polyethylene is relatively transparent, it is predominately used in film applications and in applications where heat sealing is necessary. Bread and frozen food bags, flexible lids, and squeezable food bottles are examples of low-density polyethylene.

Drying is one of the oldest methods of preserving food. It is usually accomplished by the removal of water. Dried foods are preserved for long storage time because the available moisture is very low, so that the micro organisms cannot grow and enzyme activity is controlled. It is done by many methods. 1. Sun drying 2. Using mechanical dryers.

Selection fresh fruits/frozen stored fruits/chilled fruits/fruit pulp/sulphited fruit. Wash them to remove the dairt, dust, stems, leaves, stalks, undesirable portions.

Pickling is the process of preserving or extending the shelf life of food by either anaerobic fermentation in brine or immersion in vinegar. The pickling procedure typically affects the food’s texture and flavor. The resulting food is called a pickle, or, to prevent ambiguity, prefaced with pickled. Foods that are pickled include vegetables, fruits, meats, fish, dairy and eggs.

    1.    Food : defined as something which is eaten / drunk by human beings or something we eat and which can be utilized by our body.

    2.    Milk and milk products like Dahi, yoghurt, paneer, cheese, Khoa etc these foods are rich sources of Vitamin A, Riboflavin and Calcium.

Storage Systems

    1.    Low cost storage technology

Food Processing Technology

    1.    The transition from solid to fluid and back is known as a phase transition and this is important in many types of food processing (e.g. water to water vapour in evaporation and distillation and dehydration; water to ice in freezing and freeze drying or freeze concentration or crystallisation of fats.
 
    2.    Phase transition takes place isothermally at the phase transition temperature by release or absorption of latent heat, and can be represented by a phase diagram.

    3.    A second type of transition, known as glass transition, takes place without the release or absorption of latent heat and involves the transition of a food to an amorphous glass state at its glass transition temperature.

    4.    The transition is dependent on the temperature of the food, time, and the moisture content of the food.

    5.    The density of a material is equal to its mass divided by its volume and has units of kgm^-3

Hazard Analysis and Critical Control Point (HACCP) System

1. Identify hazards
 
 It is important to be able to identify the possible microbiological, chemical and physical hazards that can occur at every stage of the food business – from growth, processing, manufacture, storage and distribution, until the point where it is sold to the customer and eaten.

    ·    Microbiological Hazards : Any bacterium, virus, or protozoan that is capable of causing illness and that grows or may be carried on food. Well-known examples of bacteria are Campylobacter, Listeria and Salmonella. The most likely food-borne viruses are the Norwalk type viruses. Giardia is an example of a protozoan that may be food borne. It is important to have some understanding of the risks associated with different types of microbiological hazards.

    ·    Chemical Hazards : Examples include excessive or toxic amounts of heavy metals, chemicals, pesticides, herbicides, insecticides, vitamins, minerals, preservatives, disinfectants, detergents and cleaning compounds. Some hazards may be naturally present such as in green potatoes or taro and rhubarb leaves.

    ·    Physical Hazards : Objects that get into food, or are already present in food, may cause illness, injury or distress to the person eating it. Some examples are glass, metal fragments etc. Other contaminants such as hair or insects may be offensive but not necessarily a danger to health. They should nonetheless be considered and controlled

Food Safety and Standards Rules and Regulations-2009

    1.    The Food Safety and Standards Act, 2006 has been passed by the Parliament with the intention to integrate all present food laws into one and to have a single regulatory body.

    2.    Accordingly the Food Safety and Standards Authority of India (FSSAI) has been established under the Food Safety and Standards Act, 2006 (FSS Act, 2006) with the mandate to lay down science based standards for articles of food and to regulate their manufacture, storage, distribution, sale and import, to ensure availability of safe and wholesome food for human consumption.

    3.    In exercise of the powers conferred by section 91 of the Food Safety and Standards Act, 2006 (34 of 2006), the Central Government hereby makes the rules and regulations.

    4.    ‘‘Anti-oxidant’’ means a substance which when added to food retards or prevents oxidative deterioration of food and does not include sugar, cereal, oils, flours, herbs and spices.

Introduction

    1.    Food Science is the application of the physical, biological and behavioral science to the processing and marketing of foods (Margaret, 1968).

    2.    Technology can be defined as the science dealing with knowledge of doing things efficiently and effectively.

    3.    Food science helps us understand the theory example: what methods can best be used to store and preserve food to maintain quality and prevent spoilage.

    4.    Food technology demonstrates how the food is stored, preserved, processed and transported and has been responsible for development of new techniques for processing and preservation of food on a commercial scale and for packaging it in such a way that it can be sold conveniently.

    5.    Food science deals with the study of facts of the physical, chemical and biological sciences as they influence the processing and preservation of food.

    6.    Food technology deals with engineering and other scientific and technical problems involved in transforming edible raw materials and other ingredients into safe, nutritious and appetizing food products (Desrosier, 1977).

    7.    Food science is concerned with basic scientific facts about food, where as food technology concerned with the processing of raw materials into foods that meet human needs and wants.

    8.    Indian agriculture has undergone a sea change during the past half a century. Starting with the campaign for “grow more foods” in the forties, India reached self sufficiency during the eighties.

Hydrometeorology forecasting is limited to forecasting of occurrence of rainfall to a greater extent. Although several countries all over the world have developed and established hydrometorological forecasting with focus on occurrence of floods and droughts, still there is very limited success. Floods are associated with occurrence of continuous heavy rainfall due to movement of low-pressure systems like cyclones and depression overflow into rivers, reservoirs and breaching of bunds. In countries like India, the floods occur on the average in 70 lakh hectors of area and the economic loss due to floods and expenditure on relief operations mounting year after year besides loss of life. Foods occur at all of a sudden leaving little time for planning mitigation or rescue operation. Flood forecasting in based on impact assessment of heavy rainfall assessments to identify the exact area that is likely to be affected. It requires more intensive research. Forecasting of droughts is still an area of serious concern. There is need to strengthen regional capabilities to develop forecasting techniques for occurrence of flood and droughts through proper analysis of historical data in conjunction with meteorological forecasts and remote sensing data. Though flood alerts are issued, the identification of exact area and the extent to which flood impacts are not very clear most of the times heavy rainfall warnings are not just sufficient until and unless the vulnerable areas can be clearly specified. The medium range forecasting will be extremely useful for issuing flood alerts.
14.1. Forecasting Droughts
Long range forecasting of seasonal rainfall can indicate the possibility of receiving excess or deficit rainfall over larger regions. In India, there is considerable progress in development of long range forecast of Southwest monsoon rainfall. This forecast also indicating the regions which may get surplus or deficit rainfall and for indifferent parts of a given region as well. However, there is serious dearth of local expertise to further analyse and interpret the long-range forecast for a given area on the basis of local climate data. The advantages of reliable long-range forecast are still unexpected. Almost one fifth of the area in India gets affected by draught most of the years. The drought affects are more severe in arid and semi arid regions. Prediction of occurrence of drought and its intensity, period of occurrence and the areas to be affected by drought is very important. During recent years, there is considerable increase in the occurrence of droughts due to climate change which is attributed mainly to atmospheric pollution. The physics of the pollution is consistent and not the policies support in handling hydrometerological disasters. There are instances where in flood and droughts occurred in the same

7.1 Introduction

The rapid population and industrial growth experienced beginning in the middle part of this century has led to spiraling increases in the demand for forest wood. Historical data reveal that there was a 159.6% increase in overall wood production between 1970 and 1993. Wood is defined simply as wood in the rough, and includes trees felled for any purpose. The majority of total wood production has been for use as fuel wood and charcoal, much of which is harvested by villagers, and to some degree urban squatters.

Since 1970, there has been a 160% increase in fuel wood and charcoal production. The largest portion (104%) occurred between 1970 and 1980, which may be attributed to the introduction of fuel wood species earlier, during the Second Five Year Plan period. Looking at the decades to come, the demand for fuel wood is likely to continue growing in pace with future increases in population, which is growing at the rate of 24 % per decade. It is estimated that by the year 2010, demand for fuel wood and charcoal will exceed 33 million cubic meters (FAO, 1993). Since there is expected to be little further change in the area under potential productive forests, there will be an increasing probability of a shortage of wood production in India (Planning Commission, 1992).

Forest microclimate is the climate within a forest in contrast to a nearby open area created by a clearing or pasture. A robust observation is that less sunlight reaches the ground in a forest than in open areas, but this depends on the size of the clearing, the height of trees surrounding the clearing, and the location in the clearing (relative to the edge) where measurements are obtained. Daytime temperature is generally lower in forest than in open areas, with greatest differences during the growing season; but this, too, is subject to edge effects and whether the canopy is sparse or dense. Wind near the ground is less than in exposed areas or above the canopy. Another point is that there are various microclimates within a forest canopy. The environment of the forest overstory differs from that of the understory, and this has important consequences for species conservation and protection from climate change. The forest microclimate has important implications for habitat and biodiversity conservation and may act to buffer forest understory organisms from the severity of climate change. Forest microclimates differ not only in contrast with open land, but also vertically with position in the canopy (Fig. 8.1).

6.1 Introduction

The state of India’s forests is important in many ways, whether it be as a source of fuel and fodder for rural citizens, of industrial inputs for a growing economy, as a habitat for thousands of plant and animal species, a sink for carbon dioxide emissions, or as a protective cover for its soils.

The forest resources forms an ecological system consisting of tree dominated vegetative associations. Forests not only provide timber, fuel wood, pulpwood fodder and fiber grasses, and non wood forest produce and support industrial and commercial activities but also maintain the ecological balance and life support systems essential for food production, health, and all round human development. Foundation architectures provide the technological basis for modern artificial intelligence systems and enable models to generalize across diverse tasks and modalities. This chapter examines the evolution of neural architectures that ultimately led to the dominance of the Transformer in contemporary language and multimodal AI. It begins with early neural networks, convolutional neural networks and recurrent neural networks before introducing attention mechanisms and the Transformer architecture. Particular attention is given to the major components of Transformers, including self-attention, multi-head attention, positional encoding and feedforward layers. Encoder, decoder and encoder–decoder configurations are examined through influential models such as BERT and GPT. The chapter further considers Vision Transformers and CLIP, demonstrating the extension of Transformer principles beyond natural language processing. At the same time, limitations such as computational complexity, memory requirements and long-context processing are discussed. Alternative approaches, including state-space models such as Mamba, efficient attention mechanisms, hierarchical architectures and Mixture-of-Experts models, are also explored as promising directions for scalable, efficient and adaptive AI.

Fourth-generation biofuels, also known as advanced liquid biofuels, represent a progression of biofuel production leveraging advanced technologies (Chiaramonti & Maniatis, 2020). They incorporate the concept of “carbon capture and storage (CCS)” at both the feedstock and processing levels. Utilizing non-competitive feedstocks like algal biomass, cellulosic materials, and genetically engineered microorganisms, 4G biofuels ensure renewable and sustainable production without relying on arable land or food crops. The feedstock is designed not only to enhance processing efficiency but also to capture more carbon dioxide as the crop grows. Thermochemical processing methods are coupled with CCS technologies, which direct the generated carbon dioxide into geological formations or storage areas such as depleted oil fields or mineral storage as carbonates (International Renewable Energy Agency [IRENA], 2021). Fourth-generation biofuels have the potential to significantly reduce greenhouse gas (GHG) emissions and can even achieve carbon neutrality or negativity compared to previous generations of biofuels. This concept aligns with the idea of “Bioenergy with Carbon Storage (BECS)” (Demirbas, 2010). These advanced biofuels are currently in the development and experimental stages, encompassing various applications related to technology, processing, and feedstock. The primary feedstock for fourth-generation biofuels production consists of genetically engineered high-yielding biomass with low lignin and cellulose contents, addressing the challenges encountered in second-generation biofuels production. Alternatively, metabolically engineered crop plants with lower lignin, high oil contents facilitate enhanced carbon capture capabilities, and improved cultivation, harvesting, and fermentation processes and can significantly enhance biofuels production (Dutta et al., 2014).

Abstract

It is evident from the previous studies that, in the crystalline terrain, the Fractures / lineaments act as master conduits for the groundwater movements and also act as favorable loci for groundwater storage. Because of this, the mapping of fracture patterns has become very popular among geoscientists. However, after witnessing failures and the fractures turned out to be water barren at many instances, geoscientists have started concentrating more on understanding the origin and the morphology of the fractures for precise groundwater targeting. In this context, a study has been conducted in parts of Western Ghats in Madurai, Dindigul and Theni districts of Tamil Nadu, South India, using remote sensing and geographic information system (GIS). In the said study, the maxima zones of transmissivity were studied in relation to fractures systems, which are normally reflected as lineaments in satellite images in the area. This study in general indicates that the transmissivity is controlled by the fractures, which are interestingly the active faults of the Quaternary period in the area.

Free carbon dioxide in the water accumulates due to microbial activity and respiration of organisms. Surface waters normally contain less than 10 mg free CO2 per litre while some groundwater may easily exceed that concentration up to 30 to 50 mg/L.
Principle
Free CO2 reacts with sodium carbonate to form sodium bicarbonate, or with sodium hydroxide to form sodium carbonate. Completion of reaction is indicated by the development of the pink colour characteristics of phenolphthalein indicator at the equivalence pH of 8.3.

1. Standard sodium hydroxide titrant (0.05N): Dissolve 40g of NaOH in boiled CO2 free distilled water and make up the volume to 1 litre. Filter the solution through a sintered glass filter to remove any Na2CO3, the concentration of solution is 1N NaOH. Store it in in glass bottle.
2. Phenolphthalein indicator

Freezing is one of the most critical stages in ice cream manufacture because it creates the frozen structure while simultaneously incorporating air. This chapter explains the principles of dynamic freezing and the structural changes that occur as the mix is transformed into semi-frozen ice cream. It discusses ice-crystal formation, air incorporation, overrun, draw temperature, fat destabilization, and product condition at freezer draw. Different freezer systems and hardening requirements are examined, along with calculations related to output and overrun. The chapter also introduces ingredient feeders and ripple or ribbon systems. Understanding freezing technology is essential for controlling texture, body, meltdown, yield, and overall product quality.

9.7.1. Function

The front axle is the unit on which the front wheel is mounted. This wheel is an idler wheel by which the tractor is steered in various directions. The function is to assist the steering and support the tractor. It is a rigid tubular or I-section steel construction, pivoted at the centre. The pivot pin is housed on bushings on a support bolted to the front of the engine. As the track width of a tractor is adjustable, the front axles have provision to be extended on both sides. This chapter examines the regulatory requirements governing ice cream and frozen dessert labelling in India, with emphasis on FSSAI standards and declarations. It explains the distinction between product standards and label declarations and introduces systems for managing recipe masters, nutrition information, label copy, artwork, and packaging approvals. Mandatory declarations, ingredient information, allergen declarations, nutritional information, claims, and common labelling errors are considered. The chapter also identifies departmental responsibilities and best practices for label compliance. Proper regulatory control ensures accurate consumer information, reduces legal risk, and supports consistent packaging and commercial operations.

ABSTRACT

This paper demonstrates the ability of FTIR for analyzing compositional structures of naturally occurring crystals namely gypsum and calcite. As these two crystals occur in a wide variety of geological environments and are susceptible to compositional and structural changes influenced by pressure, temperature, crystallization fluids and so many other factors, these are extensively studied by geoscientists for interpretation of paleoenvironment, modeling diagenesis of sediments and deducing sediment maturity for hydrocarbon exploration, study of these two crystals is important. Naturally occurring gypsum and calcite crystals collected from Cretaceous marine deposits of Ariyalur area were chosen for the present study as extensive occurrences of hydrocarbons are reported from offshore region of Cauvery basin and exploratory works are going on in the onland region. It is observed that the vibrational spectra of studied crystals show specific patterns in terms of stretching patterns of O-H, C-O, C=O, SO₄ and CO₂. As FTIR offers fast, cost-effective, non-destructive method of analyses of natural compounds, as it is proven useful, it can be utilized extensively in academic research and commercial exploration activities by geoscientists.
