1. Introduction
Animal experimentation remains a cornerstone of scientific research in many fields, from medical advances to pharmaceutical testing. However, the ethical treatment of laboratory animals has become a point of significant concern worldwide. India, through the Committee for the Control and Supervision of Experiments on Animals (CCSEA), ensures that ethical standards are maintained in research institutions. Established under the Ministry of Environment, Forests, and Climate Change (MoEF&CC), CCSEA is tasked with overseeing the use of animals in experiments, ensuring that procedures adhere to ethical guidelines and international norms. CCSEA’s guidelines are in line with international standards set forth by organizations such as the International Council for Laboratory Animal Science (ICLAS) and the European Union (EU), but they are tailored to address local needs and conditions. The guidelines, which focus on the welfare of laboratory animals, emphasize the ethical review process, animal care, and the importance of minimizing animal suffering. They also stress the need for researchers to implement the 3Rs—Replacement, Reduction, and Refinement—to minimize the use of animals and ensure humane practices in research. This chapter explores the CCSEA guidelines in detail and compares them with animal welfare regulations from around the world, including the United States, European Union, Japan, and Australia. By understanding the similarities and differences between these regulations, researchers and policymakers can ensure the ethical treatment of laboratory animals on a global scale.
2. Objectives of CCSEA Guidelines
The main objective of the CCSEA guidelines is to ensure that laboratory animals are treated ethically and humanely while also supporting the validity and scientific rigor of research. The guidelines encourage researchers to prioritize animal welfare while minimizing unnecessary suffering. Specifically, CCSEA focuses on:
1. Ethical Treatment of Animals: Ensuring that animals are housed in suitable conditions, given adequate veterinary care, and provided with a comfortable environment to reduce stress.
2. Justification of Animal Use: Ensuring that animals are used only when necessary, and that their use is scientifically justified.
3. Pain and Stress Minimization: Ensuring that experimental procedures cause the least pain, distress and suffering possible.

This chapter describes the cells, tissues and organs responsible for immune defence. It examines lymphocytes, macrophages, dendritic cells, neutrophils, mast cells, natural killer cells and plasma cells, emphasizing their respective functions. Primary and secondary lymphoid organs—including bone marrow, thymus, bursa of Fabricius, spleen, lymph nodes and mucosa-associated lymphoid tissue—are discussed. The chapter also covers lymphocyte maturation, antigen presentation, phagocytosis, immune-cell surface markers and the organization of lymph-node regions. Positive and negative selection of T lymphocytes and the formation of memory cells are included. Together, these topics explain how immune components develop, communicate and coordinate effective responses against infectious agents.

Estimation of Cellulose in Feeds and Fodders
Principle

The feed well ground is digested with acetic acid which dissolves all other constituents like protein, disaccharides, fatty acids, etc., and cellulose and mineral contents are unaffected. The residue is made acid and alcohol free by washings. Alcohol removes water, benzene removes pigments and fat and at the end the sample is dried and ashed. The difference between the dried weight before ashing and weight after ashing gives cellulose content of the feed sample.

Introduction

About sixty percent of the world’s food intake comes from the three major crops, i.e., wheat, rice and maize (Thielecke and Nugent, 2018). Depending upon the country of utilization and consumption, the products made from cereals such as barley, wheat, maize, triticale, spelt, buckwheat, rice etc. can vary in the range of pasta, bread, pastries, soups, chapatti, cooked rice etc. World cereal utilization in 2021/22 is forecasted at 2,811 million tonnes and the worldwide production of cereals is expected to reach 2,818 million tonnes by 2025 (FAO, 2020).

Food safety scientifically describes various methods of handling, preparation and storage of food to prevent any foodborne illnesses. However, it is important to check the safety between industry, market and the consumer. From the food industry to the market the practices relating to food labeling, food hygiene, food additives and pesticide residues are important to be looked into and the policies on biotechnology. The governmental imports and exports needs to be given proper guidelines. Certification systems and Inspection for foods need to be installed which should be clean and corruption free. When all this is properly considered the food could be safe in the market. This may allow for safe delivery and safe preparation of the food for the consumers. Many diseases are transmitted by food which serves as a growth medium for bacteria and cause food poisoning. In the developed countries it has been observed that there are many intricate standards for food preparation. However, in the developing countries the availability of adequate safe water itself is a question. It is possible to prevent food poisoning to 100%. An ordinance and code regulation in US (1943)was given.

Introduction

In India there are about 200 distillery having installed capacity 1555.5 million liters per annum out of which 50% are of 30 KL/ per day capacity about 50% of remaining distillery are of 45 to 60 KL/ per day capacity there are few distilleries which having go 120 KL/ per day capacity. Distillery waste is one of the major industrial waste having high organic and inorganic constituents in the recent past the treatment and disposal of distillery waste has become a subject of debate of each and every forum.

Cheese is a milk product of ancient origin and portrays the ethos of civilization and its cultural evolution. Cheese is one of the oldest foods of mankind. It is commonly believed that cheese evolved in the Fertile Crescent between the rivers Tigris and Euphrates in Iraq some 8000 years ago. The so-called Agricultural Revolution occurred here with the domestication of plants and animals.

It seems that the cheese originated accidentally as a result of the activities of nomadic tribes. Since animal skin bags were a convenient way of storing liquids for nomadic people, these were used for storing surplus milk. Fermentation of the milk sugars in the warm climate prevailing would cause the milk to curdle in the bags. The swaying animals would have broken up the acid curd during journeys, to produce curds and whey. The whey provided a refreshing drink on hot journeys, while the curds, preserved by the acid of fermentation and a handful of salt, became a source of high protein food supplementing the meager meat supply.

This activity gave rise to the assumption that cheese was evolved from fermented milks. It is perhaps more probable that the crude fermentations progressed in two ways. In one direction towards the production of liquid fermented milks such as dahi, yoghurt, laban, koumis and Kefir and in the other direction through the drainage of whey through a cloth or perforated bowls, to leave solid curds which when salted became cheese.

It was a prominent article of the Greek and Roman diet as much as 2500 years ago. It is referred to in the Old Testament several times.

Preparation of Samples

Before withdrawing portions for analytical determinations, bring the sample to a temperature of 26 to 28ºC and mix throughly by pouring gently into a clean dry receptacle and back, until a homogenous mixture is assured. If lumps of cream do not completely disappear, warm the sample to about 40ºC, mix throughly, then cool to 26 to 28ºC. In case a measured volume is required in a determination, bring the temperature of the sample to about 27ºC before pipetting. All samples shall be allowed to stand for three to four minutes after mixing to allow air bubbles to rise ; the sample bottle shall then be inverted three or four times immediately prior to taking the milk for analysis. If a sample is curdled, excessively churned or decomposed, the sample should not be taken up for analysis.

Basic chemistry encompasses the study of matter, its various states, and energy in all its forms. In order to understand the basic chemistry of living let us start from the scratch of learning and remembering everything that we have learnt so far. Matter and Its Properties Anything with mass and occupying space is referred to as matter. Solid, liquid, and gas are its three main states. Mass, distinct from weight, represents the quantity of matter in an object and remains constant regardless of location. In contrast, weight depends on gravitational force. 

This chapter introduces the chemical composition and nutritional significance of eggs. It examines egg proteins, yolk lipids, triglycerides, phospholipids, cholesterol, vitamins, minerals, trace elements, carbohydrates and pigments. The chapter explains the functional and high-biological-value nature of egg protein and examines bioactive components, digestibility and protein-quality indices. It also considers the relationship between eggs and human health, including the cholesterol debate, amino-acid profile and comparative protein quality. The chapter establishes the nutritional foundation for understanding eggs as an important food resource.

4.1 Introduction

The egg is made up of three primary components: the egg white, the egg yolk, and the egg shell. The calcite crystals of the shell are enmeshed in a protein and carbohydrate complex matrix. About 58% of the weight of an egg is made up of the viscous, colourless liquid termed egg white inside the shell. About 75% of the weight of an egg’s edible component is made up of water, although proteins and lipids make up the majority of its nutritional worth (Table 4.1). There are also trace quantities of minerals, often known as ash, and carbohydrates, which take the form of simple sugars including glucose, sucrose, fructose, lactose, maltose, and galactose.

Introduction

The mammary glands of female mammals secrete milk, a necessary food that is liquid and meets the newborn’s nutritional needs. All mammals consider milk to be a complete food for their newborns. It is considered a necessary food for humans and can be consumed as a product or as liquid milk. It contains almost all essential nutrients except iron, which is very low in milk. In essence, milk is an emulsion of protein and fat in water, supplemented with carbohydrates, vitamins, and minerals.

Definition of Milk

• Milk is a complex biological fluid that differs from species to species in both composition and physical properties. It is the full lacteal secretion of a mammary gland that is obtained by milking mammals for a minimum of 72 h after calving or until the milk is free from colostrum.

• FSSAI defines milk as the normal mammary secretion derived from the complete milking of healthy milch animals. It should be free from colostrum.

From a chemical perspective, milk is a dynamically balanced mixture that comes in different forms such as emulsion, colloidal suspension, and true solution. It also contains varying amounts of proteins, fats, carbohydrates, salts, and water.

Gross Composition of Milk

Milk composition varies among different mammals. The average chemical composition of milk in various species is given in Table 1. Buffalo milk and sheep milk contain higher amounts of fat, while human milk comparatively has the highest lactose content. Human milk has lower protein content as compared to milk of other species.

2.1. Classification of Fish

Fish are incredibly diverse aquatic vertebrates. There are over 32,000 de scribed species of bony fish, over 1,100 species of cartilaginous fish, and over 100 hagfish and lampreys. Fish can be broadly classified into three groups:

2.1.1. Superclass Agnatha (Jawless fish): These are the most primitive fish, lacking jaws and paired fins. They have existed for over 500 million years. Examples include lampreys and hagfish.

2.1.2. Class Chondrichthyes (Cartilaginous fish): These fish have skeletons made of cartilage instead of bone. They have jaws and paired fins. Examples include sharks, skates, and rays.

2.1.3. Superclass Osteichthyes (Bony fish): This is the largest and most diverse group of fish. They have skeletons made of bone and have jaws and paired fins. Examples include tuna, salmon, goldfish, and many more.

4.1. Classification

The class Aves, also known as birds, is a group of warm-blooded vertebrates characterized by feathers, toothless beaked jaws, laying hard-shelled eggs, a high metabolic rate, a four-chambered heart, and a strong yet lightweight skeleton. Birds are found worldwide and come in a variety of sizes, from the tiny humming bird to the massive ostrich.

The classification of Aves can be broken down into two major subgroups: Palaeognathae and Neognathae.

4.1.1. Palaeognathae: Also known as ratites, these are flightless birds with f lat sterna (breastbones) that lack keels, which are important for flight muscle attachment. Examples of palaeognathae include ostriches, emus, rheas, and kiwis.

Carnivora is an order of placental mammals that have specialized in primarily eating flesh, whose members are formally referred to as carnivorans. The order Carnivora is the fifth largest order of mammals, comprising at least 279 species. They come in a very large array of different body plans with a wide diversity of shapes and sizes. The common characteristics of carnivores are given below:

• They are meat eaters.

• There is the presence of canine teeth.

• The intestinal tract is short and is adapted to rapid digestion as well as the assimilation of meat.

• All species have anal glands. Some species, like the striped skunk (Mephitis mephitis), may eject the contents of the anal gland as a defensive maneuver.

• Os penis is present in males.

• There is a lack of a clavicle which helps in the freedom of movement of the forelimb.

• Ulna is well developed.

• Toes end in claws.

9.1. Classification: Order Perissodactyla

The order Perissodactyla, also known as odd-toed ungulates, is a group of herbivorous mammals characterized by having one or three toes on each foot. They are distinguished from even-toed ungulates (Artiodactyla) by this anatomical feature. Even-toed ungulates, such as pigs, cows, and deer, have an even number of toes (two or four) on each foot. Some of the well-known members of this order include horses, zebras, asses, tapirs, and rhinoceroses.

The name “Perissodactyla” comes from the Greek words “perissos,” meaning “odd,” and “daktylos,” meaning “finger or toe,” referring to their unique foot structure. Unlike even-toed ungulates (Artiodactyla), which bear weight on their third and fourth toes, perissodactyls primarily bear weight on their third toe.

7.1. Introduction

Chemical restraint of insectivores is a technique used by veterinarians and wildlife biologists to immobilize small mammals that primarily eat insects, such as shrews, moles, and hedgehogs. It is essential for performing examinations, administering medications, and conducting research on these animals.

There are several factors to consider when chemically restraining insectivores:

• Species: Different species of insectivores may have varying degrees of sensitivity to different drugs.

• Age and health: Younger and healthier animals generally tolerate chemical restraint better than older or sick animals.

• Temperature: Insectivores are sensitive to temperature regulation, so it’s crucial to maintain a stable body temperature during restraint.

10.1. Classification of Primates

The classification of primates is a complex topic that has been revised over time as our understanding of these fascinating creatures has evolved. Here’s a breakdown of the current classification system:

10.1.1. Order: Primates

Primates are an order of mammals that includes lemurs, lorises, tarsiers, monkeys, apes, and humans. They are characterized by a number of shared features, including:

• Opposable thumbs: This allows primates to grasp objects and manipulate their environment.

• Forward-facing eyes: This provides primates with depth perception, which is important for arboreal locomotion and foraging.

• Enlarged brains: Primates have relatively large brains for their body size, which is associated with their intelligence and complex social behaviors.

• Reduced sense of smell:Compared to other mammals, primates have a weaker sense of smell. This is thought to be due to their reliance on vision for foraging and social interaction.

3.1. Introduction

Various procedures performed on reptiles often necessitate chemical restraint or general anesthesia. Even routine tasks like physical examination and transportation can pose challenges, particularly with large or uncooperative reptilian patients. For safety reasons, venomous species are typically evaluated under chemical restraint. The respiratory anatomy and physiology of reptiles differ significantly from those of more familiar mammals, influencing their response to commonly used anesthetic agents. Historically, anesthetics recommended for reptiles had notable metabolic effects, but inhalant anesthesia has become more popular in recent times. Nonetheless, in species capable of anaerobic metabolism, induction with these agents may not be feasible (Girling 2013).

Rodents and lagomorphs are two distinct groups of mammals, often mistaken for each other due to some shared physical characteristics. However, they belong to different taxonomic orders and possess several key differences

5.1. Rodents

They belong to the order Rodentia and the example species include rats, mice, squirrels, hamsters, guinea pigs, beavers, and porcupines. Order Rodentia is the largest and most diversified mammalian group, differing widely in size, behavior, feeding habits, anatomy, and physiology. Based on the anatomy and functional differences of masseter muscles, it is divided into 3 suborders viz., Caviomorpha, Myomorpha, and Sciuromorpha. Caviomorpha is also called hystrichomorpha and includes guinea pigs, chinchillas and degu. The suborder Myomorpha includes mice, rats, hamsters and gerbils. These animals have the strongest ability to gnaw among animals in all 3 suborders. Sciuridae is a family that includes small or medium size rodents. This family consists of tree squirrels, ground or medium size squirrels, and large size squirrels also known as marmots or prairie dogs (Cynomys ludovicianus). Smaller and less bushy tailed squirrels are known as chipmunks (Tamias striatus) and flying squirrels (Glaucomys volans).

8.1. Classification

The ruminants belong to the Order Artiodactyla. The families in order of Artiodactyla include Camelidae, Tragulidae, Cervidae, Giraffidae, Antliocapridae, and Bovidae.

The family Camelidae includesGuanaco (Lama guanicoe), Llama (Lama glama), Alpaca or South American camelid mammal (Lama pacos), Dromedary camel (Camelus dromedarius), and Bactrian or two-humped camels (Camelus bactrianus).

The family Tragulidae includes Chevrotains originate from Africa (Hyumo schusaquaticus) and Chevrotains that originate from Asia (Tragulus species).

The family CervidaeincludesWhite tailed deer(Odococlius virginianus), Follow deer (Dama dama), Roe-deer (Capreolus capreolus), Axis deer (Axis axis), Reindeer (Rangiter tarandus), Musk deer (Moschus species) and Chinese water deer (Hydropotes species).

1.1. Introduction

Wildlife management often requires interventions to safely handle and transport animals. Chemical restraint, also known as immobilization or tranquilization, is a technique widely used to facilitate these processes (Hernandez, 2014). It involves the administration of drugs to temporarily immobilize wild animals, allowing for various procedures such as veterinary medical examinations, tagging, relocation, or rehabilitation. This chapter provides an overview of the principles, methods, drugs, and considerations involved in the chemical restraint of wild animals.

It has been often stated that the most important techniques required by the zoo veterinarian are those used in the capture and restraint of the patient. These techniques have developed into a highly technical science (Clarke et al., 2014). In the early days of zoos, the only practical method was to manually catch and hold the patient. Modern techniques, however, permit a veterinarian to shoot a CO2 powered gun, which discharges a projectile syringe at an animal resulting in complete immobilization of the animal (Jacques et al., 2009). This is accomplished without any physical contact between the patient and his captors.

Carbohydrates are the most abundant class of organic compounds found in living organisms. Carbohydrates are also called sugars and are found in plants and animals. Plants synthesize them through photosynthesis (endothermic) by fixing carbon, hydrogen, and oxygen in the presence of solar energy and chlorophyll pigments.

Carbohydrates are stored as starch in plants as a source of energy. They are also stored in animals as glycogen in muscles and the liver. They are also found in skeletal structures of cell walls in plants (cellulose), bacteria (peptidoglycans), insects, and crustaceans. This stored food is consumed by animals and man, and upon their oxidation in the body, energy is released for various metabolic activities (work, growth, and various productive functions). Compositionwise, plants are more prosperous in carbohydrates (30%) than animals (1%), with water at 60% and ash at 4%. Plants are poor in proteins (5%) and lipids (1%) as compared to proteins (20%) and lipids (15%) in animals.
2.1 Introduction to Carbohydrates
Carbohydrates or saccharides (sakcharon=sugar or sweetness) are a chemical term applied to a large group of substances, which are organic compounds containing elements Carbon, Hydrogen, and Oxygen in a ratio of 1:2:1. Hydrogen and Oxygen atoms are in the ratio of two to one as in water molecules. As the ratio of hydrogen to oxygen is like H2O, they are also known as “hydrates of carbon” and are represented as (CH2O)n. But there is an exception to this general formula. Deoxyribose (C5H1OO4) and rhamnose (C6H12O5) do not have the required ratio of 2:1 for hydrogen to oxygen. On the other side, some compounds possess this required ratio but are not carbohydrates, e.g., formaldehyde (CH2O), acetic acid (C2H4O2), and lactic acid (C3H6O3). Further, some carbohydrates have nitrogen(glucosamine), phosphorus, and sulfur but do not satisfy the above general formula. The simplest sugars are called monosugars or monosaccharides. Cheese is made from milk, with the addition of cream, buttermilk, and/or whey. This basic raw material is also called cheese milk. Cheese consists mainly of casein (the major protein of milk), other milk proteins, fat, other milk components, and a certain percentage of water, which is bound. Proteins are precipitated by enzymes and/or acidification as well as heat and are separated by suitable processes from the aqueous phase. (whey, serum). Cheese is most often molded, pressed, and salted and has fungal and bacterial culture additions. colorants, herbs, spices, and other non-dairy ingredients are also added to the cheese. It is consumed either fresh or at different stages of ripening.

Worldwide, there are more than 2000 types of cheese, sometimes made by very different manufacturing processes. A classification can be based on several aspects and is done in different countries according to different criteria. A general classification can be made for three major groups:

a. Rennet or natural cheese: manufactured straight from milk by using proteolytic enzymes (rennet) and acid, with a more or less pronounced ripening process.

b. Fresh cheese or non-ripened Cheese: Quarg, fresh cheese, and white cheese are examples. Its manufacturing process is similar to that of rennet cheese manufacturing, but it has a high degree of acidity and is not subjected to a proteolytic ripening process.

c. Long-life cheese (processed cheese): it is more often made from rennet cheese and is textured by thermal treatment and made shelf-stable.

Concentrated milk products are obtained through partial removal of water which increases the dry matter content of milk. The increase in dry matter content in concentrated milk is proportional to the degree of concentration. The milk concentrate may be prepared from either full-cream whole milk or fat-free skim milk.

Depending on the nature of raw material and other non-milk additives concentrated milks are classified into four broad categories.

1. Sweetened condensed milk

2. Evaporated milk or unsweetened condensed milk

3. Sterile milk concentrate

4. Reconstituted concentrated milk

Sweetened Condensed Milk

One of the earliest dairy products to be produced industrially is sweetened condensed milk. According to FSSA (2006), sweetened condensed milk is the product obtained by partial removal of water from the milk of cow/buffalo with the addition of sugar or a combination of sucrose with other sugars or by any other process that leads to a product of the same composition and characteristics. The fat and/or protein content of the milk may be adjusted by the addition and/or withdrawal of milk constituents in such a way as not to alter the whey protein to casein ratio of the milk being adjusted. It shall have a pleasant taste and flavor and be free from off-flavor and rancidity. It shall be free from any substance foreign to milk. It may contain food additives. It shall conform to the microbiological requirement as laid down by FSSA. The said product shall also conform to the following requirements

1.1 Introduction
Concentrated milks, like evaporated milk and sweetened condensed milk, serve as practical substitutes for fresh milk in regions where access to it is limited or where transportation and storage are challenging. These products go through specific processing techniques to reduce their water content, thereby improving their shelf life and transportability. Evaporated milk is created by removing water through evaporation and then
sterilizing it to prevent microbial growth. This process results in a thicker consistency and a slightly caramelized flavor due to the heat treatment. On the other hand, sweetened condensed milk is made by adding a significant amount of sucrose to the milk and excluding oxygen, which inhibits microbial growth. This results in a thick, sweet product suitable for various culinary uses. These concentrated milk products are usually packaged in small cans, making them convenient for storage and transportation. However, they are sometimes diluted before consumption with water to resemble the taste and consistency of fresh milk. In regions where even concentrated milks are not easily accessible, alternatives like whole milk powder or recombined milk are used. These alternatives involve dehydrating milk into powder form or reconstituting milk components to create a liquid similar to fresh milk. Innovations in processing and packaging have led to the development of alternative uses for concentrated milks, expanding their versatility beyond traditional applications. These products continue to provide essential dairy
nutrition in areas where fresh milk is scarce or hard to obtain, offering a shelfstable solution to meet dietary needs.

Chemistry of Creaming

After being drawn from animals, normal milk will form a cream layer on standing. Because of the difference in density between fat globules (920 kg m−3 at room temperature) and milk plasma (density 1030 kg m−3), the granules tend to rise. This causes creaming, which we often want to prevent and it enables milk to be separated into cream and skim milk. Creaming is much enhanced when the globules have been aggregated into flocculates, clusters, or granules.

Cream Ripening

This unit operation serves as an intensive preparation of the cream for the churning process. It is divided into two categories.

1. Physical ripening;

2. biochemical ripening The following criteria are influenced by the cream ripening:

• Consistency, firmness, and spreadability of butter.

• Basic water content of butter during the manufacturing process (bound water in butter, which cannot be removed by any mechanical treatment).

• Buttermilk fat content, which has to be minimized.

The melting and solidification behavior of fat depends on the attached fatty acid, which indicate the hardness of the butterfat.

Natural hardness is caused mainly by seasonal feeding of the milk animals. Winter feed with a great deal of dry feed or roughage yields a hard butterfat with a high percentage of saturated and short-chain fatty acids and few double bonds in the fat molecules.

Summer feeding (green grass) results in fat with longer chains and a higher percentage of unsaturated fatty acids with many double bonds. We therefore distinguish between summer fat and winter fat or summer cream and winter cream.

The process of making dried milk involves eliminating water from milk, primarily through spray or roller drying. It is regarded as a significant sector of the dairy industry and is made from whole cow, buffalo, or standardized milk. Skim milk powder (SMP) is made from milk after the fat has been removed whereas whole milk powder (WMP) is made from whole cow or buffalo milk

FSSA (2006) Standard Of Milk Powder According to FSSA (2006), Milk powder is the product obtained by partial removal of water from the milk of cows and/or buffalo. The fat and/or protein content of the milk may be adjusted by the addition and/or withdrawal of milk constituents in such a way as not to alter the whey protein to casein ratio of the milk. It shall be of uniform color and shall have pleasant taste and flavor, free from off-flavor and rancidity. It shall also be free from vegetable oil/fat, mineral oil, thickening agents, added flavor, and sweetening agents. It may contain food additives. It shall conform to the microbiological requirements prescribed by FSSA (2006).

Water activity, high storage temperatures, longer than usual storage times, high product moisture content, high processing temperatures, and container headspace are some of the variables that affect the Maillard reaction in dried milk.

Casein and whey proteins are the major proteins present in milk. Unlike casein, whey proteins are heat-labile. Whey protein fractions present in milk are α-lactalbumin, β-lactoglobulin, bovine serum albumin, immunoglobulin, euglobulin, and lactoferrin. β-lactoglobulin and κ-casein interact during heat treatment. When milk is refrigerated for longer than 24 h, it forms γ-casein and protease-peptone fractions.

requirements, and lower transportation costs, all of which contribute to favourable economic outcomes.
For example, non-fat dry milk is also known as skim milk powder, dried skim milk, non-fat dry milk solids, or dehydrated skim milk. Similarly, products like dried whole milk, dried cream, and dried buttermilk are often regarded as dried or powdered whole milk, cream, and buttermilk, respectively, based on their specific compositions.

The terms “cultured dairy foods,” “cultured dairy products,” and “cultured milk products” are other terms for fermented dairy products. Lactobacillus, Lactococcus, Leuconostoc, and other lactic acid bacteria, along with yeasts in certain products, are used to ferment milk to make these dairy products. The product’s shelf life is extended through fermentation, which also improves the product’s taste and milk’s digestibility. There is a wide variety of fermented milk products available, each with unique flavors and attributes. The following categories apply to fermented milk products, based on the type of fermentation.

Changes in Nutrients Resulting from Fermentation

Fermentation lowers the lactose content in fermented milk products; however, if the starting milk is concentrated or fortified, the finished product’s lactose content may be higher than that of liquid milk.

The composition and content of protein and total amino acids are comparable to those of raw milk. Casein degradation is small compared to cheese, accounting for not more than 1% of the total protein. While some products of casein degradation are used by the starter microorganisms, others build up as free amino acids in the fermented kinds of milk. The amounts of free amino acids that build up differ depending on the species. Generally, proline is increased in large quantities, followed by serine, alanine, valine, leucine, and histidine. As a result of continuous starter culture activity, the level of free amino acids increases during storage. A limited degree of lipolysis occurs during the manufacture of fermented milk. The amount varies depending on the type of species, but the pattern and concentration of free fatty acids are both impacted. During fermentation and the breakdown of amino acids, trace amounts of volatile fatty acids are also produced.

One of the most consumed and well- known milk products in the Indian subcontinent is ghee. It is a by- product of tradition, prepared both at organized dairy plants and the household level for a well- established market. Ghee is traditionally made from the milk of cows or buffalo. The tetrapyrrole pigments biliverdin and bilirubin are responsible for the distinctive color of buffalo ghee. On the other hand, ghee is golden yellow due to the presence of carotenoids in cow’s milk. Ghee’s composition changes according to the kind and feeding habits of the animal and can differ from place to place and season to season.

In addition to, being a substantial source of fat- soluble vitamins, essential fatty acids, and other growth- promoting components, ghee is a rich source of energy. Its value as food for humans is enormous. Additional attributes related to medicine are present in ghee. Ghee can improve one’s physical and mental attributes and treat eye conditions like ulcers. Ghee is used in religious and ceremonial rites in addition to being consumed.

Composition

Ghee is a complex lipid composed of mixed glyceride which makes up 99–99.5% of its total content. In addition, it has trace amounts of calcium, magnesium, phosphorus, iron, copper, and fat- soluble vitamins, tocopherols, carbonyls, hydrocarbons, carotenoids, free fatty acids, phospholipid, sterols, and sterol esters

4.1 Introduction
Human milk widely acknowledged as the optimal source of nutrition for infants, providing a rich array of components crucial for their growth, repair and development. However, the composition of human milk can vary
significantly within and between feeds, throughout the day, over the course of lactation, and among different mothers and also populations. While this variability is beneficial for infant health and survival, it presents challenges for the management of nutrition of high-risk infants who require precise oversight. The composition of human milk can be altered by factors such as the handling of expressed milk, including how it is stored and pasteurized. Thus, proper management of expressed milk is essential. The recommended practice for infant nutrition is exclusive breastfeeding for the first six months, followed by continued breastfeeding for at least one to two years. Human milk is naturally suited to meet the nutritional needs of infants, providing both nourishment and bioactive compounds that support healthy growth and immunity.
Human milk contains a variety of bioactive components, such as immune cells, anti-infective and anti-inflammatory agents, growth factors, and prebiotics. In contrast to infant formula, which has a fixed nutritional profile, human milk is dynamic and can vary between and within feedings, influenced by maternal factors, environmental conditions, and the methods used for expressing and managing milk.
A thorough understanding of human milk’s composition is vital for effective infant feeding, especially for at-risk infants. It also allows for the assessment of how milk storage and pasteurization may impact its beneficial components. Additionally, some of the bioactive elements in human milk are being studied for their potential use in medical treatments, either as preventive or therapeutic agents.

Commercially, one of the most significant milk products is ice cream. It is a frozen product which is usually made from milk or cream that has been f lavored with fruits like peaches or strawberries, and spices like vanilla or cocoa, or with sugar or a substitute. Stabilizers are sometimes combined with food coloring. Ice cream mix typically contains 10.0% milk fat, 11.0% solids not-fat, 14.0% added sugar, and 0.3% additives like an emulsifier, stabilizer, f lavor, and color substances.

Standard of Ice Cream

According to FSSA (2006), ice cream, kulfi, chocolate ice cream or softy ice cream means the product obtained by freezing pasteurized milk prepared from milk and/or other products derived from milk with the addition of sweetening agents and fruit products, egg products, coffee, cocoa, ginger, and nuts. It may also contain chocolate, and bakery products such as cake or cookies as a separate layer and/or coating. It may be frozen hard or frozen to a soft consistency. It shall be free from artificial sweeteners. It shall have a pleasant taste and smell free from flavor and rancidity. It may contain food additives. It shall conform to the microbiological requirements as given in FSSA (2006).

3.1 Malted Milk
Malted milk, originating from the ideas of British pharmacist James Horlick in the 19th century, was initially marketed under the name “Diastoid” before being trademarked as “malted milk” in 1887. Although initially targeted
for infants and invalids, its appeal expanded due to its nutritional value, convenience, digestibility, and palatability. Recognized globally for its lightweight, non-perishable nature, and high-calorie content, malted milk is
created by evaporating a mixture of malted barley, wheat flour, and whole milk until it forms a powder.
There aremainly two types of malt powder: diastatic and non-diastatic. Diastatic malt containing enzymes breaking down starch into sugar, aiding in dough rise and crust formation, particularly in bread making. Non-diastatic
malt lacks active enzymes and is primarily utilized for flavor enhancement, commonly in beverages. It may also include sugar, coloring agents, and other additives to improve taste and appearance.
3.2 Malting
Malting is a crucial process employed in treating cereal grains, such as barley, by inducing germination through soaking in water followed by halting the process through drying or heating with hot air. This technique encompasses two main stages: sprouting and kiln-drying. The term “malt” encompasses several products of this process:
1. Malted grains: These are grains, like barley, that have undergone the malting process.
2. Malt sugars: These are sugars, predominantly maltose-rich, derived from malted grains, often utilized in baking, such as baker’s malt.
3. Malted milk products: These include beverages like malted milkshakes, made using malted milk.

Being an essential component of the rich Indian past, traditional dairy products and a sophisticated classification of confections have played a significant role in the Indian economy. Depending on how it is processed, it has significant social, cultural, and economic significance. These products have been developed over a long period using a combination of experience, traditional wisdom, and culinary skills. India is emerging as the highest milk- producing country in the world with an annual production of 221.1 million tons in the year 2021–22 (Source: Basic Animal Husbandry Statistics, MoFAHD, DAHD, GoI). An estimated 50% of the milk produced in India is used to make a range of traditional dairy products, including paneer, dahi, ghee, khoa, and shrikhand. The product is not only well- established in the Indian market, but it also has significant export potential due to the large Indian diaspora living all over the world.

All native milk products that have developed over time using locally accessible technologies are referred to as traditional Indian dairy products or Indian indigenous milk products. The Indian masses’ economic, social, religious, and nutritional well- being are greatly influenced by traditional dairy products.

Classification of Traditional Indian Dairy Products

Traditional dairy products in India are typically made, packaged, and/or sold using time- honored methods without the use of machinery or meticulous documentation of the procedure. These products do, however, have several technological advantages, including their widespread appeal, reduced cost of production, straightforward manufacturing process, adoption at the rural level or collection center, large profit margin, and abundance of employment opportunities. These products are categorized according to the manufacturing principle.

Chocolate is almost unique as a food in that it is solid at normal room temperatures yet melts easily within the mouth. This is because the main fat in it, which is called cocoa butter, is essentially solid at temperatures below 25^oC when it holds all the solid sugar and cocoa particles together. This fat is, however, almost entirely liquid at body temperature, enabling the particles to flow past one another, so the chocolate becomes a smooth liquid when it is heated in the mouth. Chocolate also has a sweet taste that is attractive to most people.

The first known cocoa plantations were established by the Maya in the lowlands of south Yucatan about 600 AD. Cocoa trees were being grown by the Aztecs of Mexico and the Incas of Peru when the Europeans discovered central America. The beans were highly prized and used as money as well as to produce a drink known as chocolatl. The beans were roasted in earthenware pots and crushed between stones, sometimes using decorated heated tables and mill stones, similar to those illustrated in Figure 1.1.

The development of a recipe for chocolate should be based on three criteria:

(i) The intended market or use;

(ii) The limitation being placed on material and production costs;

(iii) The desired quality.

The amount of fat present in the chocolate will affect the flow properties, and fat content must therefore be varied according to the intended use.

Some point to remember while manufacturing chocolate:

1. To maintain proper viscosity if fat content is increased then sugar content should also be increased.
2. Milk chocolate requires lower fat content than dark chocolate.
3. Addition of emulsifier like commercial lecithin can save upto 5% of added cocoa butter.

Introduction

The emerging functional foods market presents a considerable challenge to all manufacturers to keep abreast of the use of adequate packaging materials for their products. The interest in functional foods is intrinsically linked to the potential health benefits of their bioactive components. Preserving these bioactive components is, therefore, a crucial factor to providing the anticipated health benefits of functional foods. However, recurring failure in maintaining the quality of functional foods has been reported. Functional foods include a wide variety of products such as prebiotics and probiotics, dried foods (fibers, tea, herbs, etc.), fermented products (yogurts, kefirs, vegetables), and fresh fruits and vegetables. Their bioactive components (minerals, vitamins, fibers, peptides, proteins, w–3 polyunsaturated fats, antioxidants, enzymes, and symbiotics) range from very simple molecules to complex living organisms such as bacteria.

Abstract

Classification of the hundreds of possible dryers is essential to the logical selection of appropriate dryer for a given application. Diverse criteria for classification as well as selection of dryers are presented and discussed briefly. The advantages and limitations of different dryer types must be taken into consideration. Initial capital cost is often the key deciding criterion in industrial dryer selection. This is not a good strategy as the user must pay for the operating costs over a long period of life of the dryer. In general several different dryer types are suitable for a given product. Careful selection is essential for cost-effective operation of the dryer.

Classification of market

There are several bases on which markets are classified.

a. On the basis of location

On the basis of the place of location or operation, markets are of the following types:

Village market

A market which is located in a small village, where major transactions take place among the buyers and sellers of a village, is called a village market.

Primary markets

• These markets are located in big towns near the centres of production of commodities. In these markets, a major part of the produce is brought for sale by the producer-farmers themselves. Transactions in these markets usually take place between the producers/farmers and traders.

Improvements in microscopes enabled scientists to study the ‘invisible’ organisms – that is, those too small to be seen with the naked eye. They were able to show that certain of these microscopic creatures are responsible for the infectious diseases of higher organisms. Most of them are harmless, some are essential for life and some are used in the manufacture of products that are of benefit to humans.

LAB constitutes a group of gram positive bacteria. They are nonsporulating, nonrespiring but aerotolerant cocci or rods, which produce lactic acid as one of the main fermentation products of carbohydrates, they do not have cytochromes. They belong to the phylum Firmicuttes, class Bacilli and order Lactobacillaceae. The group includes several genera such as Lactobacillus, Lactococcus, Bifidobacterium, Pediococcus, Enterobacter, Corynebacterium, Streptococcus, Leuconostoc etc.

Classifying wool is crucial in the textile sector for upholding quality standards, enhancing processing techniques, and ensuring that wool satisfies particular market demands. Precise classification aids in choosing the appropriate wool type for a variety of products, ranging from apparel to carpets, and guarantees uniformity and performance across diverse applications.
Classification of Wool: Wool is categorized in a manner akin to hides and skins, based on its intended application. It is divided into three primary types according to fibre length: combing wool, clothing wool, and carpet wool. Long fibres are combed and twisted to produce worsted yarn, whereas shorter fibres are carded and blended in various directions to create woollens. Carpet wool is characterized by an average fineness of 30 to 50 μm and a medullation percentage between 15% and 68%. The quality of wool is influenced by factors such as breeding conditions, climatic conditions, diet, and overall care. For example, excessive moisture can strip natural grease, while colder climates lead to tougher, heavier fibres. Consequently, wool can be classified in two distinct manners:
A. By the sheep from which it is sourced, and
B. By fleece

Wool is a fibre basically composed of amino acids and have excellent absorbency, moisture regain capacity, tend to warm the human body if used in form of cloths and others, good in elasticity and resiliency but poor in resistance to alkali but acid tolerance is good. To get better utilization of wool, they may be classified into various categories based on their origin, fleece quality, fineness of wool fibres etc.

There is no single factor as important in the production of fine quality dairy products as absolute and complete cleanliness.

It is not enough to provide milk for man, it must be high quality milk. It would be impossible to provide man with milk and milk products of superior quality if we were unable to remove milk soil and to kill residual microorganisms. Respectively, these are the processes of cleaning and sanitizing.

To successfully provide the atmosphere for proper food safety, the basics must be thoroughly understood. The basics of food safety begin with good understanding of sanitation processes, food-handling procedures that protect from, or eliminate cross contamination problems and specific attention to inspection of and follow up for all processes. Food safety activities need to be programmed into available time of day scheduling just as production requirements do. Whether special personnel or separate shifts handle cleaning responsibilities or you clean as you go on the production line, time must be made available. Safe products leaving the facility must be the watch word of all employees involved with the process.

In order to ensure safe food supply a high level of sanitation should be maintained throughout the food production chain. The word ‘sanitation’ is derived from the Latin word “sanitas” which means “health”. To further apply this word to the food industry, sanitation is the creation and maintenance of hygienic and healthful conditions when processing, preparing and handling food. Sanitation is the application of science to provide wholesome food handled in a hygienic environment by healthy food handlers to prevent contamination by food spoilage microorganisms. Effective sanitation refers to the mechanisms, which accomplish these goals.

Cleaning and sanitizing of dairy plants is essential for providing safe milk products to the consumers as well as for ensuring the good shelf life of these products. It ensures cleanliness, hygiene of the equipments and surroundings and also ensures that the products meet the safety standards. Cleaning of dairy plant consists of broadly of removing the soil from the surface of the equipment by dissolving or suspending the soil in a warm solution of suitable cleaning agents. In the dairy industry, the soil is primarily milk and milk product residues which may be more or less modified by processing treatment. 
Milk and milk product residues are complex mixtures of milk sugar, fat, proteins and mineral salts. Some of these solids are present in emulsion, some are in a colloidal state, and others are in true solution. When milk products are heated in vats or pumped through sanitary pipe lines or over coolers, the metal or glass surfaces become coated with milk remains, which, if allowed to dry, may be difficult to remove.

Cleaning and sanitation are essential for maintaining microbiological safety in ice cream manufacturing, particularly because contamination can occur after pasteurization and freezing does not eliminate all microorganisms. This chapter explains contamination routes, hygienic zoning, cleaning systems, sanitization practices, HACCP principles, and microbiological expectations within an ice cream plant. It examines CIP and COP systems, detergent components, cleaning factors, high-risk equipment and surfaces, and post-pasteurization contamination control. Particular emphasis is placed on preventing biofilms and controlling contamination at filling equipment, tanks, pipelines, feeders, drains, packaging areas, and personnel interfaces. The chapter provides practical sanitation guidance to support food safety, product stability, regulatory compliance, and consumer protection

Introduction

The Intergovernmental Panel on Climate Change (IPCC) assessment reports (IPCC, 2007) suggests that consequently occurring climate extremes are likely to increase the frequency and intensity in the future. In the Indian context, events such as landfall of rare of rarest most intense pre-monsoon Tropical cyclone Fani (2019), back to back landfall of very intense tropical cyclones such as Phalini (2013) and Hudbud (2014), Cyclone Komen (2015), Extreme rainfall events of Kerala (2018 and 2019), Heavy rainfall events of over Northeastern states of India (2019), Cloud burst events of Uttarakhand (2013), Rainfall over Himachal Pradesh (2019), Mumbai Rain fall (2015) and extreme heat wave conditions of 1998, 2015 and many similar type of extreme events are not usual. However, at present there is no unanimity among scientists to exclusively and directly link such extreme weather events to climate change, however based on number of studies and observation data sets it is agreed that the impact of climate change is evident (beyond the natural variability) in many part of the globe including India. In 2019 monsoon season at least 1351 deaths happened to ?oods, heavy rainfall and landslides compared to 1550 for year 2018. In this manuscript, recent research findings related to extreme weather events in the context India are discussed in the following section-2, need for high resolution and long term data sets are emphasized in section-3, followed by recommendations as part of future preparedness, that will not only enable us to address these issues in a robust scientific manner but also provide us strong resilient society to face these extreme weather events in an optimized and effective manner to minimize the loss of lives, properties and socio-economic conditions of citizens.

Introduction

Climate change has been realised during 1840s when indisputable evidence of former ice ages was obtained. The climate has altered sufficiently in many parts of the world even within the last few decades which will affect the possibilities for agriculture and settlement. Reliable weather records have been kept only during the last hundred years or so, but proxy indicators of past conditions from tree rings, pollen in bog and lake sediments, ice core records of physical and chemical parameters, and ocean foraminifera in sediments provide a wealth of paleoclimatic data. The standard interval adopted by the World Meteorological Organization for climatic statistics is thirty years:1901–30, 1931–60, for example. However, for historical records and proxy indicators of climate, longer, arbitrary time intervals may be necessary to calculate average values. Tree rings and ice cores can give seasonal/annual records, while peat bog and ocean sediments may provide records with only 100- to 1,000-year time resolution. Hence, short-term changes and the true rates of change may, or may not, be identifiable.

The present climatic state is usually described in terms of an average value (arithmetic mean, or the median value in a frequency distribution), a measure of variation about the mean (the standard deviation, or interquartile range), the extreme values, and often the shape of the frequency distribution. A change in climate can occur in several different ways, for example, there may be a shift in the mean level, or a gradual trend in the mean values. The variability may be periodic, quasi-periodic or non-periodic, or alternatively it may show a progressive trend . First, it is important to determine whether such changes are real or whether they are an artefact of changes in instrumentation, observational practices, station location, or the surroundings of the instrumental site, or due to errors in the transcribed data. Even when changes are real, it may be difficult to ascribe them to unique causes because of the complexity of the climate system. Natural variability operates over a wide range of time scales, and superimposed on these natural variations in climate are the effects of human activities.
