The Metric System

At present metric system is followed to calculate final results in analysis work. This system is quite simple in nature as well as in principle. The units of the metric system are: (1) the  metre (linear measure), (2) the litre (measure of capacity), and (3) the gram (measure of mass.)

One litre is the volume of pure water at 4ºC and 760 mm pressure which weigh 1 kilogram (kg). One litre equals 1000.027 cubic centimetres (Cm3) for most work, the units “millilitre”, “cubic centimetre” and used interchangeably.

At present there are three different temperature scales in common use. These are: the Fahrenheit (F), used chiefly in English-speaking countries. the centigrade (C), used universally in scientific work and the Absolute (T) or Kelvin (K) scale, differing from the centigrade only in the position of the zero point, its divisions being of the same size. its zero point is -273ºC. The kelvin scale is used especially in dealing with very high or very low temperature and in computations involving the laws of gases. The following formulae can be used for converting one scale to another:

Conversion of muscle to meat is a complex process in which several physical and chemical changes takes place over a period of several hours or even days. The major changes which take place during this process include fall in muscle pH and temperature as well as muscle shortening which further leads to proteolysis or ageing. These changes during conversion of muscles to meat are variable and have great effect on meat quality (tenderness, juiciness, flavour, colour etc.) and also on certain processing characteristics like emulsification, binding properties and yield of the products. To know this complex process it is necessary to understand the process of energy production and metabolic pathway shifting in live animals.

Pre Slaughter

In the living animal, aerobic metabolism is used to obtain energy. The source of energy at this stage is either free fatty acids or blood glucose or muscle glycogen. In this process total 38 ATP molecules are produced from single glucose or glycogen molecule by the complex processes known as glycolysis, oxidative decarboxylation and oxidative phosphorylation. However, under stressful situations, anaerobic metabolism may be used and lactic acid is produced. Lactic acid is usually transported from the muscles to the liver, where it is re-synthesized into glucose and glycogen, or to the heart, where it is metabolized to carbon dioxide and water.

Principle

The use of boric acid as an ammonia absorbent was first introduced by winkle  (1913-15). Conway and O’Malley (1942) used boric acid for ammonia absorption in their original micro diffusion technique.

The ammonia liberated in the outer chamber by alkali addition in the usual way is absorbed in boric acid mixture plus indicator in the central chamber (slightly reddish), the pH of this mixture being approximately 5 before absorption. During the ammonia absorption the pH of the mixture rises, and to upwards of 8.0 (the strength of the mixture being such as to prevent it rising further). After the required period, the fluid in the central chamber is titrated to a faint permanent reddish tint with standard acid. A mixture of methyl red and bromocresol green was found satisfactory  to work as an indicator to assist in titration job.

Definition

It is one of the important portion of milk which forms a fatty layer on top of milk when left un-disturbed. It is a prime component of milk and comprises mainly of milk fat. It may be defined as “that portion of milk which is rich in milk fat” meaning portion of milk into which larger portion of milk fat has been gathered.  According to FSSAI, 2011 Malai and Cream are defined as –

Malai means the product rich in butter fat prepared by boiling and cooling cow or buffalo milk or a combination thereof. It shall contain not less than 25.0 per cent milk fat.

Butter is one of the leading milk product in developed countries of the world. It serves as a balance wheel of dairy industry. Surplus milk is generally converted into butter to be used during the times of scarcity. It is an article of commerce and a sign if wealth. Butter is a fat concentrate, which is obtained by churning cream, gathering the fat into a compact mass and then working it for proper distribution of moisture and salt. The art of butter making has a long history. The manufacture of butter was confined to colder regions where gravity creaming was successful. The milk was allowed to stand undisturbed for 10-12 hours until layer of cream collects at the top.

Cultural characteristics of bacteria deal with the appearance of the growth in various liquid and on solid media. The growth characteristics of most of the bacteria are typical of the group or species and help in their identification. The terminology employed to describe various features of bacterial growth are mentioned below.

Culture methods employed depend on the purpose for which they are intended. In the laboratory the indications for culture are mainly to

1.Isolate bacteria in pure culture.

2.Demonstrate their properties

3.Obtain sufficient growth for preparation of antigens and for other tests.

4.Type isolates by methods such as bacteriophages and bacteriocin susceptibility.

5.Determine sensitivity to antibiotics

6.Estimate viable counts

7.Maintain stock solution

Introduction 
The discovery and introduction of antimicrobial agents to clinical medicine was one of the greatest medical triumphs of the 20th century that revolutionized the treatment of bacterial infections. However, the gradual emergence of populations of antimicrobial resistant pathogenic bacteria, resulting from use, misuse and abuse of antimicrobials has today become a major global health concern. Antibacterial drugs have revolutionized our ability to control bacterial disease, and their clinical availability has led to dramatic decreases in morbidity and mortality. (Walsh and Wright, 2005). As such, these therapeutics underpin modern medicine. Despite the integral role of antibiotics in sustaining our modern lifestyle, they are undervalued in both cost and significance by society. Over the past century, their use has provided strong selective pressure on microorganisms, leading to preferential survival and spread of those harbouring antibiotic resistance mechanisms. Multidrug resistance is now commonplace amongst bacterial pathogens with antibiotic resistance now affecting all antibiotic classes. (Coates et al, 2011). This is particularly worrisome in the case of Gram-negative bacteria (e.g. Pseudomonas aeruginosa and Acinetobacter baumannii) for which treatment options are already limited. The ‘broken’ economics of antibacterial research and development is often quoted as the main reason for the lack of new therapies but the truth is that it is hard to discover new antibacterial drugs, and the science is not sufficiently advanced to allow discovery of efficient and effective drugs. This has led to fears of a ‘post-antibiotic era’ as it has been estimated that 5–20 novel antibacterial drugs need to enter clinical development in order to effectively contend with the current resistance problem. However, given the attrition rate within the existing drug discovery model, at least 200 discovery programmes would be needed in order to achieve this outcome. Hence, new approaches to antibiotic discovery are needed. The antibiotic pipeline The antibiotic pipeline is not what it once was.4 Pharmaceutical companies were once the main provider of novel antibiotic molecules but they largely withdrew in the late 1990s because of the lack of success and low financial returns in bringing new antibacterial drugs to the market.5 The environment of discovering and developing new antibiotics was quite different during the so-called ‘golden era’ of drug discovery. Antibiotics worked remarkably well because resistance was low and physicians had access to a variety of efficacious antibiotics. Antibiotic research and development programmes were inclined to focus on improved pharmacology to achieve less frequent dosing e.g. once a day, rather than innovative new antibiotics. Natural product screening strategies tended to result in rediscovery of compounds rather than finding new ones. There was also no need to consider those natural products with undesirable properties such as toxicity. Today, only a few large companies such as GlaxoSmithKline, Novartis, Merck and Roche are still actively engaged in antibiotic R&D, with many of the original antibiotic provide.The natural world remains the largest source of novel drug scaffolds making this a viable option in the search for new antibiotic compounds. Advances in bacterial culture techniques, molecular biology and metagenomics will make natural product drug discovery easier and more costeffective, obviating these limiting factors. Screening procedures must include whole-bacterial cell assays, addressing the issue of bacterial permeability and efflux early in the discovery process (Shore and Coukell, 2016). Additionally, the generation of training schemes by, and with, pharmaceutical companies that cover all aspects of the pipeline and include natural product drug discovery, are essential and will ensure that expertise is passed on to future researchers. Investment should also be made into the study of previously characterized lead compounds that did not reach the clinic, so called old leads. The reasons that led to these compounds being dropped from further development vary, ranging from financial issues to trial design, dosing problems and toxicity. It may be that there is now sufficiently improved technology and expertise to develop these as safe and efficacious antibacterials. The revival of interest in old leads could also provide an additional source of novel antimicrobials. A freely accessible database of antibiotics that were never developed has recently been launched, Antibiotic with the aim to reduce unnecessary duplication of Pharmaceutical agents such as nanospheres, liposomes, and immunoglobulins for example have been developed which can alter the pharmacodynamics of a compound, act as carriers for sustained or controlled drug release, and for immunization therapy.

Today, antimicrobial resistance (AMR) has become a global issue, contributing to rise in mortality and cost of treatment. Antimicrobial resistance (AMR) is the resistance of a microorganism against an antimicrobial agent to which it was originally sensitive (WHO, 2013). Dispersion of antibiotics is done at large scale, in India even sometimes without any proper prescription. Animal Husbandry is not untouched and antibiotics are used to a great extent, which needs enforcement of strict government rules and regulations for their use in f ield conditions (PHFI, 2011).

Extended-spectrum β-lactamases (ESBLs) are enzymes that hydrolyse most of the β-lactam antibiotics and thus mediate resistance to penicillins, 3rd and 4th generation cephalosporins (Saravanan et al., 2018). Beta-lactamase inhibitors, inhibit these ESBLs such as clavulanic acid, sulbactam and tazobactam (Trott, 2013). The genes encoding for these enzymes are commonly found both on the chromosomes and plasmids among Enterobacteriaceae family (Kotsoana et al., 2019).

Among Enterobacteriacae, E. coli and Klebsiella species are main environmental pathogens associated with various illnesses such as acute bovine mastitis (Koovapra, 2015), pathogenic E. coli with diarrhoea and extra intestinal infections in humans and animals (Levine et al., 1987), K. pneumoniae with respiratory and urinary tract as well as bloodstream infections (Daehre et al., 2018). Resistance to extended-spectrum β-lactams occurs mainly in members of Enterobacteriaceae family through plasmids encoded ESBL genes. (Sharma et al., 2010).

Meat cutting and fabrication is a skilled process in which separation of carcass into wholesale primal cuts is done to facilitate meat trade requirements, consumer preference and easy handling to the butchers. The person engaged in cutting and fabrication of carcass cuts must be skilled and expert in their job. He/she must have the expert knowledge of carcass configurations and location of retail cuts in animal carcasses. To obtain good quality retail cuts, carcass should be essentially chilled and temperature of meat cutting room should be 15-20oC with relative humidity of about 80%.

Principle

Cyanide is distilled from chloroform and water soultion into KOH solution, forming potassium cyanide. KCN is titrated with silver nitrate; 2 KCN + AgNO₃ = KCN. AgCN + KNO₃. An excess of AgNO₃ produces insoluble AgCN, which is the end point of titration.

The world’s greatest source of cow and buffalo diversity is India, and countries like Australia, South Africa, Latin America, and the USA employ Indian cattle breeds to grow their livestock industries. The number of cattle in the nation represents 17% of all cattle in the world. 22-25% of the Indian cow population is made up of the best native milk, draught, and dual-purpose animal genetics. The majority of local cattle breeds are excellent drafters. Native livestock breeds are clearly superior in their use of subpar feed, have better heat tolerance, and greater resistance to tropical diseases.

All across the world, the dairy industry is facing numerous problems and changes. Dairy development has received a considerable boost from factors including access to technical advancements, improvements in infrastructural facilities, and the development of modern marketing insights. It is interesting to see how the dairy sector is changing globally.

Dairy byproducts constitute an important segment of dairy industry. An important criterion in the economic choice of any process is the efficient utilization of byproduct that is produced along with the main product. The main byproducts of dairy industry are skim milk, buttermilk, whey and ghee residue. Each and every component of milk must be judiciously processed into edible form not only to improve the profitability of dairy industry but also to make best use of the unique nutritional value of the precious milk constituents on one hand, and to prevent environmental pollution, on the other. However, dairy plants, particularly in India, are usually confronted with the problem of byproduct utilization, especially that of whey and ghee residue in economical manner.

Skim milk is a byproduct obtained during the manufacture of cream. It is rich in solids-not-fat content and has high nutritional value. In dairy plants, it is mostly utilized either in standardization for the manufacture of main dairy products or preserved by removing moisture in milk powder form. The skim milk when utilized in either of these two forms or consumed as liquid, is not considered a byproduct. It is regarded as a byproduct only when it is either not economically utilized or utilized for derived byproducts, like casein and other related products, co-precipitates, protein hydrolyzates, etc.

Buttermilk is the byproduct obtained during butter manufacture. Sweet cream buttermilk resembles skim milk in gross chemical composition and is usually admixed with bulk of skim milk for further spray drying or even product manufacture in dairy plants. Desi buttermilk, on the other hand, has long been an important domestic beverage in India. It has high nutritive and therapeutic value. It also finds its way in the preparation of a host of culinary dishes such as kadhi, dhokla and idili. Also a number of federations and private plants sell salted and spiced buttermilk in 200 ml pouches.

Operation Flood and dairy cooperatives became India’s greatest rural employment programme, enabling the modernization of the dairy industry to a point from where it may take off to fulfill the need for milk and milk products within the nation as well as chances on the international market. An unorganized sector handles 80% of the milk a rural producer produces, and an organized sector handles the remaining 20%. It has been discovered that dairy cooperatives significantly contribute to reducing rural poverty by increasing rural milk production and marketing.

Milk processing plants involve processing of raw milk into products like market milk, cheese, butter, ice cream, condensed milk, dried milks and traditional dairy products. The by-products processing includes buttermilk, whey and its derivatives. Dairy effluents contain dissolved sugar, protein, fat and minerals. Spills and leaks of products or by-products, residual milk or milk products in piping and equipment before cleaning, wash solutions from equipment and floors, condensate from evaporation processes and cheese trimmings are some of the sources of dairy effluents in a dairy plant. The key parameters are the biological oxygen demand (BOD), chemical oxygen demand (COD), total suspended solids, total dissolved solids etc. Common dairy waste techniques include grease traps, oil water separators for separation of floatable solids, equalization tanks. Biological treatment consists of aerobic and anaerobic process.

India has the highest livestock population in the world with 50% of the buffaloes and 20% of the world’s cattle population, most of which are milch cows and milch buffaloes. The dairy industry in our country is considered as one of the most successful development programmes in the post-Independence period. In the year 2006-07the total milk production in the country was over 94.6 million tonnes with a per capita availability of 229 gm. per day. The industry had been recording an annual growth of 4% during the period 1993-2005, which is almost 3 times the average growth rate of the dairy industry in the world. Milk processing in India is around 35%, of which the organized dairy industry account for 13% of the milk produced, while the rest of the milk is either consumed at farm level, or sold as fresh, non-pasteurized milk through unorganized channels. Dairy Cooperatives account for the major share of processed liquid milk marketed in the India. Milk is processed and marketed by 170 Milk Producers’ Cooperative Unions, which federate into 15 State Cooperative Milk Marketing Federations. Over the years, several brands have been created by cooperatives like Amul (GCMMF), Vijaya (AP), Verka (Punjab), Saras (Rajasthan). Nandini (Karnataka), Milma (Kerala) and Gokul (Kolhapur). Uttar Pradesh, Punjab, Haryana, Rajasthan, Gujarat, Maharashtra, Andhra Pradesh, Karnataka and Tamil Nadu are the milk surplus states in India.

Dairy Industry in India
Milk holds a deeply symbolic place in Indian culture, far beyond its role as a mere food item. It is intricately woven into the cultural and historical identity of the nation, with the dairy industry serving as a cornerstone of India’s economy. The sector is a driving force behind rural development providing a crucial pathway to prosperity for millions of small-scale farmers. It plays a significant role in alleviating poverty and generating employment opportunities. The dairy sector by empowering farmers, developing modern infrastructure embracing technological advancements, and promoting sustainable practices, fostering widespread socio-economic progress in rural India. In the 1920s, modern milk processing and marketing technologies were introduced in India. The National Dairy Development Board (NDDB; founded in 1965), implemented Operation Flood (1970-96) to modernize the dairy sector through cooperatives. This led to the rise of dairy cooperatives countering the exploitation by private milk plants. The cooperatives followed the Anand model, a three-tier structure comprising village-level societies (producers), district-level unions (milk collection and processing), and state-level federations (marketing). Originating in Anand, Gujarat in 1946, the model was later adopted nationwide. The progress termed as White Revolution transformed India from a nation struggling with milk shortages into the world’s largest producer and consumer of milk. By 1997, India became the global leader in milk production with a volume of 70.9 million tons, surpassing the United States (FAO data rearranged by Our World in Data). Further in the year 2014, for the first time, it beat the entire European Union. Since 1950, India’s milk production has seen tremendous growth, rising from 17 million tonnes in 1950-51 to 230.58 million tonnes in 2022-23. The per capita availability of milk increased from 124 g/day in 1950-51 (PIB 2022) to 459 g/day in India during.

Dairy ingredients are of significant importance in the formulation of many food products. Additionally, the incorporation of dairy ingredients, comprehensively recognized by the consumer as “natural” intensifies the odds of success of packaged foods and adds functional properties of the dairy ingredients in the targeted product. Dairy ingredients can be extracted from fluid milk in the form of cream, butter, condensed milk, dry milk, cheese, and whey products [1]. They provide beneficial functionality to foods, such as delivery of key nutrients, water management, fat-holding capacity, emulsification capability, viscosity creation, gel formation, and foam generation apart from providing desirable attributes of texture and flavour. Various ingredients and claims associated with dairy foods are shown in Table 3.1.

Milk is nutritious and essential food for human beings and also serve as good medium for microbial growth and contamination. Milk is a single, most nearly complete, natural food. Primarily it is meant for nourishing the newborns but man has exploited it for human consumption since long. Today milk has become indispensable integral component of our diet. About half the milk produced is consumed as fresh milk, the rest going into a variety of products including evaporated and condensed milk, dried milk powder, butter, cheese, malted milk, ice cream, yoghurt, lactose and casein. Milk is very important from a nutritional standpoint since it contained all the essential food constituents (carbohydrate-lactose, protein-casein, fat-butter, minerals- calcium, potassium and vitamins- A, B, C, D, E, and K) required in human diet in about the proper proportions. India is the second largest producer of milk in the world. India has exhibited unprecedented rate of growth in dairy development in last 30 years mainly due to sustained efforts of dairy technologists in Operation flood Programme introduced by the National Dairy Development Board. Dairy microbiology deals with aspects like shelf life and spoilage microbes, public health significance and food borne pathogens, and production of fermented dairy products.

DAIRY BUSINESS

Most ambitious young men at some time or another are likely to develop an interest in going into business for themselves. This is prompted not only by the thought that a person owning his own business is more independent but also by the hope of increasing personal income. However, when these same young men look about them and see the general existence of “big business” in practically all lines of endeavour, they often lose courage and decide to remain as workers with some company where they can enjoy a certain degree of security. 
The general condition is an important factor in determining the success of new business enterprises. Similarly, innovations like the creation of new products or the development of new methods of merchandising often gives rise to opportunities for a new business enterprise. The introduction of “Softy” ice cream and other soft-served frozen products made it possible for several hundred small businesses to get established in our country. The advent of single- service paper container was the spark that started several milk-plant operations which later grew into companies of considerable size. Ironically, the paper milk container also spelled the doom for many older independent plants that could not or did not adjust soon enough to this new way of packaging. The chocolate-coated ice-cream bar idea started a number of new enterprises which grew from small companies going to concerns of considerable size. Vending machines made it possible for many small companies to get started selling milk, ice cream, candy and lassi etc. 

Introduction

The dairy industry is a cornerstone of worldwide agricultural economies, underpinning nutrition, employment, and rural development. India stands out among nations with thriving dairy sectors, accounting for approximately 23% of global milk production (Prasad et al., 2023). With advent of Operation Flood in the late 1970s, India’s dairy industry has undergone transformative changes. This movement revolutionised milk production, rural income, and the organisation of cooperatives. The Indian dairy sector is still unorganized and only 18-20 per cent of the total milk produced is handled by organized sector (Gowda, 2023). There is rising trend of value addition along with rising demand of processed dairy products in India. These changes underscore the importance of effective dairy plant management systems, where strategic oversight of milk procurement, processing, and product manufacturing ensures quality, efficiency, and sustainability.

The GOI is pushing to strengthen infrastructure for the production of quality milk, as well as for procurement, processing, and marketing of milk and milk products through the following Dairy Development Schemes:

6.1. Dairy Entrepreneurship Development Scheme (DEDS)

Dairy Entrepreneurship Development Scheme (DEDS) was started in September 2010. This scheme is being implemented through NABARD which provides financial assistance to commercially bankable projects with loans from Commercial, Cooperative, Urban and Rural banks.

Objective of the scheme

To generate self-employment and provide infrastructure for the dairy sector, to set up modern dairy farms and infrastructure for the production of clean milk, to encourage heifer calf rearing for conservation and development of good breeding stock, to bring structural changes in the unorganized sector so that initial processing of milk can be taken up at the village level, to upgrade traditional technology to handle milk on a commercial scale, to provide value addition to milk through processing and production of milk products.

1.1. Global Dairy Scenario

Global milk production is forecast at 852 million tonnes in 2019, an increase of 1.4 per cent from 2018 (DAHD, 2019) – a smaller rate of growth, reflecting downward revisions made for India and the European Union. Much of the anticipated output expansion will originate in India, Pakistan, China, the European Union, and Brazil, partially offset by declines in some countries including Australia, Colombia, and Argentina. In India and Pakistan, herd expansions drive output growth, while in China, farm efficiency improvements underpin higher growth. The output is increasing in the European Union, although slowly as dry weather limited the supply of milk during the summer, whilst rising dairy herds and stable milk prices are supporting higher production in Brazil. By contrast, the output may decline in Australia and Colombia due to dry weather, whereas in Argentina, rising feed costs and restrained consumer demand may dampen production. Elsewhere, in the United States, higher milk yields hold up the growth momentum, whereas, in New Zealand, favourable weather corroborates a positive production outlook (DAHD,19).

Reliable artificial intelligence depends on accurate, timely and multidimensional livestock data. This chapter examines the transition from manual record-keeping to sensor-based systems that capture physiological, behavioural, production and environmental information. Data sources include wearable devices, IoT monitoring networks, computer-vision systems and environmental sensors. Their applications include monitoring health, welfare, movement, feeding and productivity. The chapter also considers the integration of heterogeneous datasets and persistent challenges involving missing values, noise, interoperability, scalability and system reliability. By connecting data generation with intelligent analysis, it emphasizes that robust acquisition protocols and dependable infrastructure are essential for developing effective, evidence-based and responsive livestock-management systems.

Livestock farms generate large quantities of physiological, environmental, behavioural and production data through sensors, IoT devices and management records. Raw information must be processed before it can support dependable analysis. This chapter explains data cleaning, missing-value treatment, noise reduction, anomaly detection, integration, normalization, transformation and dimensionality reduction. It also discusses feature extraction, categorical encoding, variable transformation and temporal-feature analysis. Machine learning, AutoML, Python, R and other analytical platforms are introduced as tools for preparing livestock datasets. Applications include disease prediction, yield improvement and movement monitoring. The chapter concludes by examining scalability, data quality, privacy and ethical challenges in intelligent livestock analytics.

Traditional livestock diagnosis is often reactive and may identify disease only after clinical symptoms become visible. This chapter introduces deep-learning methods for automated health monitoring, early disease detection and predictive analytics. Models analyse images, videos, body temperature, heart rate, activity patterns and historical health information. Convolutional neural networks extract visual features and classify diseases, while LSTM networks identify patterns in time-dependent physiological and behavioural data. Multimodal fusion improves the reliability of predictions by integrating different data sources. IoT-connected systems can generate real-time warnings and support timely intervention. The chapter compares deep learning with conventional approaches and evaluates accuracy, recall, false-negative rates and practical deployment.

Ice cream defects can result from formulation imbalance, poor ingredient quality, processing deviations, inadequate freezing or hardening, packaging problems, storage conditions, and cold-chain failures. This chapter provides a systematic framework for understanding, classifying, diagnosing, and correcting defects affecting flavour, body, texture, melting, colour, appearance, packaging, and storage stability. It emphasizes that a visible defect in the finished product may originate much earlier in the production or distribution chain. Examples include iciness caused by slow freezing or temperature abuse, weak body associated with formulation or overrun, and flavour problems originating from raw materials or microbial activity. Defect analysis therefore becomes an important tool for troubleshooting, quality improvement, training, and preventive action.

Introduction

Any work condition revolves around three main components - the man, machine and environment. 'Man'-is represented by the worker who is either the controller or the executor of an action. Therefore the work output depends on how efficiently the workers are performing. In this context, the health of the worker is of utmost importance. It is one of the prime supporting pillars of productivity. If the health condition declines, efficiency is reduced and productivity suffers. Work involves a variety of physical and cognitive activities performed to achieve a desired or specified productivity. It may include a single individual or a small or large group of people as the worker. It is characterized by a specified duration, specific speed or work pace and a required amount of effort. The performance and efficiency expected from the workers have a direct bearing on the work process or work tool and the work environment. All these stress the bodily systems and affect the health of the worker. The stress could be classified as physiological stress and psychological stress Occupational health deals with the study and maintenance of physical, mental and social well-being of workers in the workplace (WHO, 1957). Introduction

Flowering plants (Angiosperms) are identified by their morphological characteristics like flower, fruit and seeds that help their taxonomic characterization into different species, genera, families and orders. The floral characters which are used for taxonomic characterization of plants include the type of inflorescences, perianth structure, floral symmetry, arrangement of floral leaves, type of androecium, stamens, gynoecium, carpel, ovule, etc. The type of fruit and seed also play important roles in taxonomic classification. In this chapter we will briefly discuss about various morphological features of flowering plants (in botanical terms) that are useful in taxonomy.

Nomenclature of Plant

Nomenclature of plant is the formal and scientific naming of plants. It is related to but distinct from taxonomy for grouping and classifying plants and provide botanical name.

The scientific/botanical nomenclature started with Species Plantarum by Carolus Linnaeus in 1753. Botanical nomenclature is governed by the International Code of Nomenclature for algae, fungi, and plants (ICN), which replaces the International Code of Botanical Nomenclature (ICBN).

ICBN and ICN

International Code of Botanical Nomenclature, (ICBN) was adopted by the VIIth International Botanical Congress held in Stockholm, July1950. While the International Code of Nomenclature for algae, fungi, and plants (ICN) was adopted by the XVIIIth International Botanical Congress held in Melbourne, Australia in July 2011.

This chapter explains the meaning and characteristics of commercial ice cream, with particular attention to the Indian regulatory and market context. It examines major commercial product types, their compositions, ingredient functions, and differences from artisanal products. The chapter also discusses contemporary market trends and changing consumer expectations, including premiumization and alternative formulations. Quality challenges such as ice crystal growth, sandiness, shrinkage, weak body, coating defects, and cold-chain failures are considered, providing readers with a practical understanding of commercial ice cream production and positioning.

Eggs are an essential food for humans due to the high nutritional quality and quantity that they contain. Eggs are one of the most consumed foods all over the world because of its nutritious profile, range of uses, and relatively inexpensive cost as a food source. Intakes of total lipids, cholesterol, and saturated fatty acids in human diets can be attributed, in part, to the consumption of animal products. Due to the high amounts of cholesterol (about 200-300 mg/100 g) and saturated fat (approximately 3 g/100 g), eggs have been considered to be contentious foods by several health organisations and nutritional experts.

Abstract

Designer foods are known by various names like medical foods, fortified foods, nutritional foods, nutraceutical foods, pharma foods etc. These foods are nutritious, maintain health and prevent diseases. Such foods must possess characteristics like modified composition; limit the presence of certain potentially harmful components and include certain desirable ingredients either naturally or by intentional addition. The term designer food emerged some years ago to describe foods tailored to specific concentration and proportion of nutrients that are important to health. These are designed and produced by using different approaches. The term ‘designer foods’ is subjected to change based on nutritional labelling regulations, new developments, consumer perceptions and expectations. Grain improvement through biotechnology emphasizes crop upgrading with a specific challenge to manipulate the endosperm composition in order to improve its intrinsic properties for diet and health. Breeding fruits with higher bioactive compounds for disease resistance and improved composition have stimulated interest in the nutraceutical and processing aspects of the fruits Nutritive and genetic interventions to alter milk composition for specific health and processing opportunities are gaining importance in dairy biotechnology. Designer eggs having modified fat provide choices with different nutritional benefits. The options suggested for designer meat and meat products are through production practices, post-harvest procedures and reformulation techniques. All these features of designer foods will be presented with suitable examples.

This chapter introduces specialty eggs whose composition, production system or marketing attributes differ from conventional eggs. It examines designer eggs, omega-3 enrichment, vitamin and mineral enrichment, organic egg production, free-range and cage-free systems, and welfare-oriented production. The chapter also addresses labelling, certification, consumer trust and the market prospects of specialty eggs. Particular attention is given to the biological basis and technological limits of nutritional enrichment and to critically evaluating claims concerning nutrition, welfare, safety and environmental benefits.

Isolation of RNA from Rat Liver
(Method of Schmidt and Thannhauser, 1945)
Principle

Most of the RNA (ribouncleic acid) of cells is found in the nucleoli and microsomes.These fractions of cells may be isolated by differential centrifugation of cellular homogenates and thus provide an enriched starting material for RNA extraction. Such methods require high speed  centrifugation. An alternate procedure used in the present method is to disrupt the whole cells by homogenization and isolate the nucleic acid of entire homogenate. This procedure consists of the following sequential steps.

1 Detection of Starch Introduction

Starch is widely available in several forms such as wheat flour, corn flour and commercially manufactured starch. It is extensively used by adulterators to raise the SNF content in the milk. When high amounts of starch are added to milk, it can cause diarrhea due to the indigestion of starch in colon. Apart from this, accumulation of starch in the body may prove very fatal for diabetic patients. In this method, starch in milk can be detected by using iodine solution. Iodine from the iodine solution gets absorbed on the starch molecule surface and resultant product of adsorption has deep blue colour.

Reagents

Jones and Ekman (1960) showed that ¹⁴⁴Ce is absorbed to a very small extent in the gut of the ruminant and suggested its use as a marker in digestibility trials. Huston and Ellis (1968) studied the affinity of radioactive cerium for feedstuffs and digesta particles in vitro experiments and found that cerium is rapidly absorbed onto and remained tenaciously bound to  digesta particles. Ellis and Huston (1968) tested radioactive cerium as a particulate flow marker in sheep with favourable results.

Experimental Procedure
Three Holstein bulls weighing 315, 239 and 305 kg and one Holstein steer weighing 327 kg are used. Twice daily, at 9.00 am and 9.00 pm, they are fed 3.4 kg of a balanced ration, meeting NRC requirements for normal growth and maintenance.

Limitation of Weende Method

The partition of carbohydrate into fiber (CF) and nitrogen free extract (NFE) is presumed to represent a separation of less digestible starch and sugars. However, in 20 to 30 percent feeds listed by Morrison, the NFE is less digestible than the CF. This comes about for several reasons, the most important of which is the CF method (successive boiling with dilute sulphuric acid and sodium hydroxide) does not recover all the fiber and large portions of fibrous constituents  are extracted into the NFE. The most  important of these fractions are lignin and hemicellulose are dissolved by both acid and alkali. The basic error of the NFE concept is the assumption that if constituents are soluble they are digestible. Lignin, the rigid component of wood, not only is indigestible but lowers the digestibility of substances with which it is associated.

Another portion of the indigestible part of NFE arises from an artifact in the calculation of faecal NFE, where it is presumed that faecal nitrogen is protein (N x 6.25). Actually, 80-90 percent faecal nitrogen is NPN and is composed of bacterial residue in which the ratio of organic matter to nitrogen is about 1:4. Thus, part of the faecal NFE arises by an underestimation of the organic matter associated with faecal nitrogen.

Strontium and barium are adsorbed on a cation-resin column, and  after a suitable gowth period, yttrium-90, the daughter of strontium-90, is selectively eluted. The yttrium-90 is then adsorbed on and eluted from a second cation-resin column and counted. The radiochemical yield is greater than 97% gravimetric measurement of the recovery of strontium and yttrium carriers is not required. The method, with modifications, is applicable to samples that contain 100 mg of iron or uranium.

Abstract

The concept of functional foods has received significant media attention and, as a result, interest has focused on the need for research into the non- nutrient constituents of food plants. This has enabled market penetration of functional foods containing increased amounts of bioactive food compounds or physiologically active nutrients and non-nutrients within food that impart proven health benefits. Functional foods can take many forms. Some may be conventional foods with bioactive components that can now be identified and linked to positive health outcomes. Some may be fortified or enhanced foods, specifically created to reduce disease risk for a certain group of people. Numerous observational studies have shown that omega-3 fatty acids enriched diets are associated with a reduction of cardiovascular mortality, heart attack and sudden death. In several studies, a higher fish intake has been associated with decreased incidence of coronary artery disease (CAD) and cardiovascular mortality. A trial revealed that fish oil supplementation of 130 mg/kg of body weight each day decreased the number of stiff joints, duration of morning stiffness, pain and global arthritis activity. Many supplements contain active ingredients that have strong biological effects in the body. The bioavailability of nutrients within a given food is governed by the composition and microstructure of the food, commonly referred to as the food matrix. More specifically, numerous studies investigating the development of functional foods have shown that the interactions between nutrients and non-nutrients within the food matrix can be synergistic, additive, or neutralizing in nature. The preventive and curative effects of the functional foods on health concludes it to be integral components of established public health programs to reduce the risk of specific diseases.

All animals have a range of ambient environmental temperatures termed as thermo-neutral zone. This is the range of temperatures that are conducive to health, performance and well-being. The upper critical temperature is the point at which heat stress begins to affect the animal adversely. There are a number of climatic factors like temperature, humidity, wind speed and radiant energy/sunlight that influence the degree of heat stress. Heat is also produced by metabolism within the body, which includes maintenance, growth and production. Heat production is affected by body weight, species and breed, level of production, level of feed intake, feed quality and, to a lesser extent, by the amount of activity and exercise. Excluding temperature of the air ventilating the house, heat is also added from the roof and walls. Heat stress can be defined as the point where the animal cannot dissipate adequate quantity of heat to maintain body thermal balance. During the periods of heat stress, most of the productive energy is diverted to thermoregulatory adaptations that results into decreased weight gain, poor immunity, oxidative stress predisposing animals to various infectious diseases and high mortality rates. In order to characterize and quantify thermal comfort zones according to animal species, several thermal comfort indices or heat stress indices were developed.

The primary focus for livestock and poultry has been on heat stress indices to provide guidelines for environmental management and risk assessment for losses through linkages with physiological responses (Eigenberg et al., 2005) or performance (Baccari, 2001). The linkage is based on observations of a selected performance criterion (e.g., growth, milk or egg production) made concurrently with measures of the warm environment. These serve as inputs for the selected heat stress index and thus an empirical relationship can be developed which is termed as ?biological response function?. These indices recognize the ability of the animal to cope with environmental stressors by adjusting physiologically, behaviourally and immunologically to minimize adverse effects or even compensate for reduced growth and production performance during moderate environmental challenges. When the intensity and duration of potential stressors exceed thresholds, coupled with limited opportunity for recovery, animals are unable to cope and therefore are affected adversely. Nevertheless, the heat stress indices have served as useful surrogates for the complex interactions between the physical and biological components (Hahn et al., 2003).

Digestion may be defined as the hydrolytic process carried out by various enzymes for breaking down complex food components such as proteins, fats and carbohydrates into simpler molecules like amino acids, fatty acids and monosaccharides, respectively. Whereas, absorption may be defined as the movement ofthese simple soluble digested food componentsalongwithvitamins, minerals and water from gastrointestinal track into the circulatory system.

The process of digestion starts from oral cavity (mouth) and ends at large intestineincluding tongue, teeth, jaws,secretions from salivaryglands (parotids, sub maxillary or submandibular and sublingual glands), pharynx, esophagus, stomach, small intestine and digestive enzymes secreted from pancreas and liver.

Digital dairy farming integrates IoT, artificial intelligence, machine learning, big-data analytics, cloud computing, sensors and automation to improve herd management. This chapter explains how wearable devices and monitoring systems support early disease detection, welfare assessment, milk-yield analysis and precision feeding. Automated milking, feeding and other operations reduce manual labour, improve consistency and lower operating costs. The architecture of smart dairy systems—including sensors, wireless communication and decision algorithms—is examined alongside environmental and economic benefits. Barriers include high initial investment, limited digital skills, poor rural connectivity and cybersecurity risks. Future developments may include AI-enabled autonomous dairy farms and interconnected, sustainable agricultural ecosystems.

Digitalization is transforming ice cream operations by connecting procurement, production, quality, cold chain, sales, distribution, finance, and management through integrated information systems. This chapter examines the transition from traditional manual operations to ERP-, AI-, IoT-, and data-driven management. It explains the costs of limited digitalization and the department-wise benefits of integrated systems, including better traceability, demand forecasting, inventory management, energy monitoring, cold-chain control, predictive maintenance, and profitability analysis. The chapter also explores artificial intelligence, business intelligence, IoT monitoring, and evidence from industry research. It emphasizes that technology alone is insufficient: standardized processes, accurate master data, user training, governance, and management discipline are essential for achieving measurable digital transformation.

Quantitative heat production estimation is necessary to  know the net energy of feeds and fodders. In the case of ruminants approximately 8 per cent of the gross energy consumed is lost as methane, therefore it becomes necessary to know this important loss in terms of methane energy so as to assess the metabolisable energy of any particular feed. In human subjects, heat production studies are conducted to know the effect of planes of nutrition on basal metabolism as affected by different environmental conditions.

In the important laboratories of world, heat production and methane production studies were conducted by respiration chamber (open circuit and closed circuit), since in our country respiration chamber has been installed at IVRI, Izatnagar, Bareilly (U.P.) India, therefore, this technique is mentioned in brief in this chapter. Indirect calorimetry involving the use of face mask and Douglas bag is followed at present in our country at NDRI, Karnal (India) so as to study the basal metabolic rate (BMR), heat production in human subjects and animals, Krishna (1973). Some laboratories in the country are interested to study respiratory quotient at different levels of feeding in human subjects and animals. The methods of estimation of RQ (respiratory quotient) is expressed in detail in this chapter.

Those usually most affected by natural and other disasters are the poor and socially disadvantaged groups in developing countries as they are least equipped to cope with them (IFRC 2001).
