Abstract
The United Nations predicts that by 2050, the global population will reach 9.6 billion, leading to urgent challenges such as ensuring food security and reducing greenhouse gas emissions. Climate change, coupled with biotic and abiotic pressures, will significantly impact global food production. Despite advances in agriculture, malnutrition remains a widespread issue, affecting millions, especially in developing countries. Protein-energy malnutrition, which affects over 170 million children and women, poses a significant threat to national economic development, increasing healthcare costs and reducing productivity. One key solution to combating malnutrition lies in promoting legumes (pulses), which are nutrient-dense, protein-rich, and vital for both human and animal consumption. Pulses have been a staple in diets
for centuries, providing essential nutrients like protein, fiber, vitamins, and minerals. They are not only beneficial for human health, reducing the risk of heart disease, diabetes, and cancer, but they also contribute to sustainable agriculture. Legumes can fix atmospheric nitrogen, reducing the need for synthetic fertilizers, improving soil health, and increasing agricultural productivity. However, despite their benefits, pulse production lags behind other staple crops like cereals. With proper management, legumes could play a vital role in alleviating global hunger, particularly in developing countries. Increased awareness and efforts to incorporate legumes into farming systems and daily diets could help meet the growing global demand for nutritious, sustainable food.

Abstract
Food insecurity and malnutrition are on the rise globally, impacting millions, especially in rural regions where extreme poverty and food insecurity are deeply rooted. Vulnerable groups, including women, youth, and indigenous peoples, are disproportionately affected. Producing foo  that meets dietary needs and ensuring its availability in the future is essential for sustainable development and food sustainability. Addressing the growing global food security concerns and supporting the increasing population requires the continual expansion of plant-based proteins’ significance. Legumes are excellent sources of proteins, carbohydrates, and both soluble and insoluble dietary fibers. Legumes, with their high dietary fiber and low-fat content, help maintain body weight and lower the risk of cardiovascular disease. They are also rich in essential minerals such as potassium, calcium, magnesium, phosphorus, and iron, and provide important vitamins like folate, thiamine (B1), riboflavin (B2), and niacin (B3). Additionally, pulses contain various phytochemicals, including phenolics, flavonoids, phytates, lectins, tannins, saponins, oxalates, enzyme inhibitors, phytosterols, and antimicrobial peptides, which offer numerous potential health benefits. These phytochemicals exhibit anti-inflammatory, anticancer, antimicrobial, and anti-ulcerative properties. Incorporating legumes into agricultural systems can foster more sustainable and climate-resilient farming practices. In developing countries, legumes are often used to supplement cereals or starchy foods to combat protein-energy malnutrition, as animal proteins tend to be expensive in these regions.

Abstract
India shares one fourth of global annual grain legume production and is also largest consumer of it. Weeds are the most severe and widespread biological constraint on agricultural production systems and cause damage to cropped and non-cropped lands. They reduce crop yield and degrade the quality of the produce, besides raising the cost of production. The grain legumesare commonly grown under rainfed/dry land conditions and hence do not receive the best management practices that are required for maximization of crop productivity. Among various production inputs, weed management was found to be the most important one contributing about 31% in pigeon pea, 110% in urdbean and 60 % in mungbean towards total productivity. Effective weed management in grain legumes is essential for optimizing
crop yield and quality. This process involves a multi-faceted approach that integrates cultural, mechanical, and chemical methods to address the challenges posed by diverse weed species and varying environmental conditions. Traditional single-method approaches often fall short due to the complexity and variability of weed problems like development of resistance in weeds. Therefore, an integrated weed management approach becomes effective, combining timely interventions with adaptive strategies to manage weed competition throughout the growing season. This approach not only enhances crop competitiveness and yield but also offers economic and environmental benefits by reducing reliance on broad-spectrum herbicides and promoting sustainable practices. Continuous monitoring and adjustment
of weed management strategies are crucial to effectively tackle evolving weed populations and changing conditions, ensuring long-term success in grain legume cultivation.

Abstract
Legumes are an excellent group of fertility restorer crops which can be grown either as sole crop or as a component crop in the cropping system. As they are tolerant to drought condition, they can be grown throughout the year. The yield of legume crop is largely depending on pest, diseases and weeds. Among these weeds plays a major role as the weed seed bank inside the soil influence the weed population in the cropping season. Hence it is important to manage the weed seed bank for better productivity of legumes. Though legumes are short duration and fast growing crops, the germination percentage of weed seed bank will determine the final yield of legumes. There are many strategies to which the weed seed bank can be controlled to tolerable level before which the weed seed bank present in the soil has to estimate. Annual weed seed bank can be minimized by killing the weeds before they set seeds, harvest weeds, crop rotation, cover crops, inter cropping and ensiling. Weed seed bank depletion can be done by tillage, tricking the weed seeds, conditioning weed seeds, soil solarisation and herbicide application. Thus integrating various technologies may help in effective controlling of weed seeds to tolerable level thereby enhancing the yield of leguminous crops.

Principles
The quality of foods can be defined as the ‘composite’ of those ‘characteristics’ that differentiate individual unit of a product and have significance in determining the degree of acceptability of that unit by the consumer. The overall quality refers to technological, physiological, chemical, microbiological, nutritional; and sensory parameters to achieve the wholesome food. Sensory quality attributes such as taste, colour, texture, flavour and overall quality of any food products were evaluated by 9- point Hedonic rating test is used for the purpose of evaluation. This test measures the consumer’s acceptability.

Principle
Jam: Jam is a product made by boiling the fruit pulp with a sufficient quantity of sugar to reasonable consistency, firm enough to hold fruit tissues in position. Apple, pear, sapota, apricot, carrot etc. are used for preparation of fruit jam. Jam contains 0.5-0.6 % acid and invert sugar should not be more than 40 %.
Total soluble solids (TSS)
The TSS value is defined as the amount of sugar and soluble minerals present in fruits and vegetables. A refractometer is based on the principle of total refraction. This is done by placing a few drops of distilled water on the prism in the specimen chamber of the back the cover. The distilled water reading should be zero. If it is not so, it should be set to zero with the scale correction knob. The specimen chamber is now cleaned with muslin cloth or tissue paper. For determining the TSS, a drop of sample (jam, juice and syrup, etc.) is placed on the prism and the percentage of dry substance in it read directly on scale in refractometer.

Principle
Jelly: Jelly is a semi-solid product prepared by boiling a clear, strained solution of pectin containing fruit extract, free from pulp, after the addition of sugar and acid. A perfect jelly should be transparent, well set, but not too stiff, and should have the original flavour of the fruit. It should be of attractive colour and keep its shape when removed from the mould. Pectin (0.5-1.0%), acid (0.5-0.75%), sugar (65%), and water are the four essential ingredients. Pectin test and determination of end-point of jelly formation are very important for the quality of the jelly. Some recipes for jelly making are given below:

Objective: Development of RTS beverage from seasonal fruits.
Material required
Fruit, juicer-mixer-grinder, preservatives, sugar, refractometer, pan and knife etc.
Principle
Ready To Serve(RTS): This a type of fruit beverage which contain at least 10% fruit juice and 10% total soluble solid besides about 0.3% acid. This is not diluted before serving.
Before undertaking the preparation of beverage, it is necessary to know techniques of extraction of pulp/juice from various fruits used for RTS.

Principle
Squash: A fruit juice squash essentially consists of juice containing moderate quantity of fruit pulp to which cane sugar is added for sweetening e.g. orange squash, plum squash. This is a type of fruit beverage containing at least 25 percent fruit juice/pulp and 40-50 percent total soluble solids, commercially. It also contains about 1.0 percent acid and 350 ppm SO2 or 600 ppm sodium benzoate. It is diluted before serving.
Mango, orange and pineapple are used for making squash commercially. It can also be prepared from lemon, lime, guava, pear, apricot, muskmelon, papaya etc., using potassium metabisulphate (KMS) as preservative, or from jamun, passion fruit, peach, phalsa, mulberry, raspberry, straw berry, grapefruit etc., with sodium benzoate as preservative.

Principle
Nectar: The term ‘fruit nectar’ is used to designate pulpy fruit juice blended with sugar syrup and citric acid to produce a ready-to-drink beverage. In this fruit beverage contains at least 20% juice/pulp and 15% total soluble solid and also 0.3% acid. It is not diluted before serving. Many fruit juices are either too acidic or strongly flavoured; these cannot be pleasant without dilution of blending or both. These strong, tart juices are delicious after dilution with thin syrup or blend juice e.g. apricot, guava and plum juice. Out of the tropical fruits, nectars made from banana, guava, mango and papaya are quite popular. The product is sealed in container or glass bottles and processed by heat to prevent spoilage. The fruit ingredients may be puree, pulp, juice or concentrated equivalent to 40 percent of the finished products. Apples, cherries and pineapples are used in combination with others fruits. The sweeteners are sugar, invert sugar syrup, dried corn syrup, glucose syrup and the optional ingredients are lemon juice, citric, malic and fumaric acids as acidifier and ascorbic acid as antioxidants (150 ppm) can be used.

Principle
Chutney and sauces are important food products prepared both in homes as well as commercially in India. They improve the digestion and are good appetizers. Tomatoes are a good source of vitamin C. Fresh tomatoes are very refreshing and appetizing but can not be stored for a long period. Often they are sold at distress prices during the peak harvest season and nearly 25% of the produce is spoiled due to mishandling and improper processing facilities. Such losses can be reduced by converting fresh tomatoes in to delicious product like paste, puree, juice, ketchup/sauce and powder. Generally, the sugar content in ketchup/sauce varies from 10-26%. The salt content of the product should be 1.3 to 3.4%. Good quality vinegar is essential for the preparation of high quality sauce/ketch up. It should contain 5.0-5.5% acetic acid or glacial acetic acid (100% acetic acid) and should be added when the product has thickened sufficiently. Tomato sauce/ketchup generally contains 1.25-1.50% acetic acid. In order to increase the viscosity and prevent the separation of pulp from clear juice, pectin can be added to extent of 0.1-0.2% pectin by weight of the finished product. Add 0.025% sodium benzoate as preservative to the product before bottling and then pasteurize.

Principle
Pickle is an edible product preserved and flavoured in a solution of common salt and vinegar. Spices and oil are also added. They add to palatability of a meal, aid in digestion and are good appetizers too. Pickles are prepared from fruit and vegetables like cauliflower, reddish, carrot, green chili, turnip, cabbage, onion, mango, jackfruit, aonla and lemon etc. Commercial preservation of many pickle relied upon conversion of fermentable carbohydrates by lactic acid bacteria to organic acids during bulk storage and/or the addition of sufficient amount of sugar, vinegar and other ingredients to the fully cured and packed products to preclude any microbial growth. Organic acids, oil, salt and spices all have antimicrobial properties at suitable concentration especially in combination which preserves the pickles. Pickles in brine such as or after fermentation however, need some amount of preservative or pasteurization to prevent the spoilage.

Biscuits are similar name used in Europe and UK. Cookies are chemically leavened. Sugar and shortening are creamed to form dough with flour and leavening agents. When cookies dough enters the oven, the fat starts melting and sugar is dissolved which allow the cookies to spread as a function of gravity. The leavening agents expand it in all direction and structure is stabilized with high temperature prevailing in the oven.

Procedure
1. Mix the dough with ingredients I. Keep it for fermentation till breaks easily without stretching.
2. Put the sponge to mixer. Add salt, sugar, flour and optional ingredients and mix. In last, add shortening. The dough should be soft and very smooth.
3. Let the dough relax for about 30 min. cut pieces of dough weighing 100 g/450g.
4. Mould in along oblong shape and place in baking pans.
5. Proof the moulded dough to a desired height.
6. Bake at 210oC to a golden colour.
7. Cool the loaves overnight.
8. Cut the rusk of desired thickness. Arrange on baking sheets and toast at 190oC till these are crisp and golden brown in colour.
9. Cool and packaged.

Objective: Development of Sugarcane Vinegar.
Principle: Sugarcane is one of the main crops worldwide, and it has an important impact on environmental issues. Sugarcane is used in daily routine life in many ways like as vinegar, jiggery, juices etc. In India sugarcane crop is best cultivated in the west U.P. Sugarcane original vinegar drink with high nutritional quality was produced from fresh sugarcane juice using the yeast culture and acetic acid bacteria by fermentation techniques such as submerged alcoholic fermentation followed by acetic fermentation at room temperature. Refined sugarcane is the primary product of sugarcane juice, during its processing; various other valuable products are also obtained in an unrefined form such as brown sugar, molasses, jaggery and vinegar. Sugarcane juice is widely used in the treatment of jaundice, hemorrhage, dysuria, and other urinary disease. Nowadays sugarcane vinegar is also used in Indian kitchens commonly in pickles, salads, etc. Vinegar is extremely useful for human health including antimicrobial activity, blood pressure reduction, antioxidant activity, reduction in the effects of diabetes, and prevention of cardiovascular disease. Vinegar can be made from any carbohydrate source, amylaceous, or sugary substrate through two successive fermentations: alcoholic fermentation, which is carried out by means of yeasts, and acetic fermentation, with acetic bacteria as the protagonist.

Objective: Preparation of Turmeric powder
Turmeric (Curcuma longa L), the ancient and sacred spice of India known as ‘Indian saffron’ is an important commercial spice crop grown in India. It is used in diversified forms as a condiment, flavouring and colouring agent and as a principal ingredient in Indian culinary as curry powder. It has anti-cancer and anti-viral activities and hence finds use in the drug industry and cosmetic industry. 'Kum-kum', popular with every house wife, is also a by-product of turmeric. It finds a place in offerings on religious and ceremonial occasions. A type of starch is also being extracted from a particular type of turmeric. The increasing demand for natural products as food additives makes turmeric as ideal produce as a food colourant. India is the largest producer, consumer and exporter of turmeric in the world.

Objective: Development of Potato chips
Potato is a perishable commodity and cannot be preserved longer in fresh form. Although for some time potatoes can be preserved by low temperature storage but this low temperature storage results in many undesirable biochemical changes in the quality of the potatoes. Another alternative for the preservation of potatoes is to conversion in the shelf stable value-added processed products. Further, value-addition and processing of potato will also ensure the availability of wholesome, safe, nutritious, and acceptable food to consumers throughout the year along with simultaneous reduction in post-harvest losses and profit to the farmers for their produce. Potatoes are processed into a great variety of products, including cooked potatoes, par-fried potato strips, French fries, potato chips, potato starch, potato granules, potato flakes and dehydrated diced potatoes and others. Globally, only two potato-based snack foods i.e., chips/ wafers and French-fried potato are the main value-added products of potato, accounting for more than 42% of the potato based processed products. Such type of fried products is loved for convenience and their premium taste, flavour, and texture. With the technological advancements, now potato processing is highly industrialized and market driven. Like other processed products, the finished product quality of potato based value-added products severely depends upon the quality of raw potatoes used. Therefore, the major challenge in potato processing is to fulfil the tuber quality requirements specifically, tuber morphology, reducing sugar (=0.1%) and dry matter content (=20%). Alternatively, we can infer that all type of potato is not suitable for processing. The crispy texture of potato chips is one of the most important quality indicators of the finished product, apart from colour, odour and flavour. Potato chips texture is often described in terms of crispness, hardness and crunchiness. This crispy/crunchy character is an important sensory characteristic on which consumers base their appreciation.

Objective: Development of Salted Banana chips.
Banana is the second most significant natural product harvest of India close to mango. It is accessible round the year and due as it would prefer, nutritive and the rape tic worth. Mixing of ingredients
Sugar, cocoa mass and milk powder are intensively mixed forming a dry powder. This powder is pre-ground in various types of mills and then finely ground in a 5-roll refiner. The size of particles in chocolate is between 15- 70 mm (average 25 mm). Small operators use vertical ball mills. Optimum flow properties are required for further processing. 1.1 Carbohydrates Biochemistry
Carbohydrates are essential for life, both in plants and in animals. They are organic chemical compounds made of C, H, and O. These elements get arranged in different ways so that several simple, and stored complex compounds (starch in plants and glycogen in animals) are available in abundance on the Earth. They are involved in enormous biological and nonbiological functions. Their biological functions, found in all living things, are the chief energy source for men and animals, even for herbivorous fishlike carp and rohu fingerlings. Carbohydrates are also essential structural components like nucleic acids, containing genetic information. One must recognize the protective function in cells, plants, and human health management. Even bacteria form a glycocalyx and biofilm for protection. Knowledge about their involvement in blood groups helped to identify universal donors, universal recipients, and genuine donors for the recipient to save a life. Carbohydrates are found as a storage structure for energy in emergency conditions.
Upon combustion, they yield carbon dioxide and water. Autotrophs (plants) synthesize them from carbon dioxide and water to grow, reproduce, and store, but heterotrophs (humans and other animals) use them, too. In plants, they occur as fibers, supporting structures, and simple sugars. The plant carbohydrates are used for preparing adhesives, fermentation, foods, and papers. Cotton fibers are used to make clothes to cover the body and protect humans and animals against adverse climatic conditions.

Carbohydrates are the most abundant class of organic compounds found in living organisms. Carbohydrates are also called sugars and are found in plants and animals. Plants synthesize them through photosynthesis (endothermic) by fixing carbon, hydrogen, and oxygen in the presence of solar energy and chlorophyll pigments.

Carbohydrates are stored as starch in plants as a source of energy. They are also stored in animals as glycogen in muscles and the liver. They are also found in skeletal structures of cell walls in plants (cellulose), bacteria (peptidoglycans), insects, and crustaceans. This stored food is consumed by animals and man, and upon their oxidation in the body, energy is released for various metabolic activities (work, growth, and various productive functions). Compositionwise, plants are more prosperous in carbohydrates (30%) than animals (1%), with water at 60% and ash at 4%. Plants are poor in proteins (5%) and lipids (1%) as compared to proteins (20%) and lipids (15%) in animals.
2.1 Introduction to Carbohydrates
Carbohydrates or saccharides (sakcharon=sugar or sweetness) are a chemical term applied to a large group of substances, which are organic compounds containing elements Carbon, Hydrogen, and Oxygen in a ratio of 1:2:1. Hydrogen and Oxygen atoms are in the ratio of two to one as in water molecules. As the ratio of hydrogen to oxygen is like H2O, they are also known as “hydrates of carbon” and are represented as (CH2O)n. But there is an exception to this general formula. Deoxyribose (C5H1OO4) and rhamnose (C6H12O5) do not have the required ratio of 2:1 for hydrogen to oxygen. On the other side, some compounds possess this required ratio but are not carbohydrates, e.g., formaldehyde (CH2O), acetic acid (C2H4O2), and lactic acid (C3H6O3). Further, some carbohydrates have nitrogen(glucosamine), phosphorus, and sulfur but do not satisfy the above general formula. The simplest sugars are called monosugars or monosaccharides. There are two main functional groups in

Hydrates carbons (saccharides) found in nature (animals and plants) are classified into three groups based on the number of monosaccharides found or released upon acid hydrolysis. Monosaccharides the groups of carbohydrates.
3.1 Formulation of Monosaccharides
The molecular formula of any monosaccharide (mono=one and saccharide=sugar) is Cn(H2O)n or (CH2O)n. Rhamnose and Deoxyribose are exceptions to the general formula of carbohydrates. Acetic acid (C2H4O2) and formaldehyde (CH2O) are not carbohydrates but have the formula Cn(H2O)n or (CH2O)n. Fitting and Baeyer proposed the formula CHO-(CHOH)4-CH2OH, which indicates the presence of aldehyde and five hydroxyl groups.
More than one monosaccharide molecule unites to form disaccharides, oligosaccharides, and polysaccharides. Monosaccharides, being simpler units, cannot be broken down further. Generally, they have two to ten carbon atoms per molecule (dioses to decoses). The monosaccharides may have either aldehyde or ketone groups. The one possible aldodiose (CH2OH.CHO) is glycolaldehyde (2-hydroxyethanal), but ketodiose is not possible since there are only two carbons. The glucose molecular formula C6H12O6 represents the number of C, H, and O atoms but not groups. However, the proposed formula, CHO-(CHOH)4-CH2OH, indicates the presence of an aldehyde and five hydroxyl groups. These simple sugars or monosaccharides have carbon backbones linked by single bonds with hydrogen and hydroxyl groups attached in an unbranched manner.

Oligosaccharides comprise 2 to 10 units of monosaccharide molecules, which are released upon hydrolysis. The oligosaccharides are classified depending upon the number of monosaccharide units, e.g., Disaccharides (two monosaccharide units), Trisaccharides (three monosaccharide units), Tetrasaccharides (four monosaccharide units). Disaccharides are the most common oligosaccharides found in nature.
4.1 Disaccharides
Disaccharides are formed when glycosidic linkages covalently bond two monosaccharides together. A glycosidic bond is formed when the hydroxyl group on one of the sugars reacts with the monomeric carbon on the second sugar. A glycosidic bond can be alpha or beta, depending on the steric configuration at carbon one on the monosaccharide unit. During the union of two monosaccharide units, water molecules are eliminated (dehydration reaction or condensation reaction, or dehydration synthesis), and the formation of a glycosidic bond occurs, through which the units are linked via an oxygen bridge.

Polysaccharides comprise several monosaccharide units (more than ten) linked by glycosidic bonds; therefore, they are high molecular weight carbohydrates. They are also called polyanhydrides of simple sugars. The most common monosaccharide unit of polysaccharides is D-glucose. The polysaccharides may differ in their monosaccharide units, molecular weight, chain nature, glycosidic bond types (alpha, beta), and linkages (1-2, 1-3, 1-4, or 1-6). They are tasteless, colorless, amorphous powders that are a little water-soluble. Some may form colloidal solutions. The polysaccharides provide structural stability (structural polysaccharides) to cells, prevent cells and tissues from drying out due to their water-binding properties, and reserve food for the future. Reserved polymeric carbohydrates are osmotically less active and can be stored in large quantities within the cell.
The right and left end of polysaccharides, respectively, are called the reducing and non-reducing ends. Based on the functional aspects, they are grouped in two ways.
• The first way depends on its digestibility—1. Nutrient polysaccharides are (digestible) starch, dextrin, and glycogen, and 2. Structural polysaccharides are (indigestible), chitin and cellulose.
• The second way, depending upon the constituent monosaccharide units, they are 1. Homoglycans (same units), and 2. Heteroglycans (different units).

6.1 Metabolism
Dietary components like carbohydrates, lipids, and proteins are continuously broken down and synthesized through various chemical reactions (exergonic or endergonic) that are concerned with energy. These processes not only break them down but also interconvert them for their synthesis. Dietary components, when utilized, are known as nutrients the body. The number of reactions occurring in living cells maintains the body cells and fluid’s homeostasis and dynamic status. To keep the dynamic state of a cell, many reactions are going on to synthesize or break down the different types and sizes of molecules. The total of these reactions is known as metabolism.
The metabolism may be anabolic or catabolic. Further, it may be aerobic or anaerobic, depending on oxygen availability. These four terms are explained below:
I. Aerobic and Anaerobic Metabolism
• Aerobic metabolism-- In aerobic metabolism, the carbohydrates (substrate) in the presence of oxygen are metabolized to release energy, carbon dioxide, and water. The released energy is converted to ATP by two processes in the mitochondria (the Krebs cycle and oxidative phosphorylation). In oxidation, the electrons released from a glucose molecule are transferred to reduced NAD+ and FAD. The oxygen (electron acceptor) is reduced to water. Water formation [from H2(g) and O2(g)] is an exothermic reaction. The energy released from the chemical bond of glucose is captured as ATP, and heat is released.

Glycolysis involves a series of reactions to extract energy from glucose to
release two molecules with three carbons called pyruvate. The process is not
dependent on oxygen but can occur under aerobic and anaerobic conditions,
releasing different end products. Under aerobic conditions, the pyruvate formed
is then oxidized in the mitochondria to CO2 and H2O. The energy released in
glycolysis is in the form of ATP (High Energy Bond). All the reaction steps
occur in the cytoplasm, as it is the extramitochondrial pathway. In anaerobic
conditions and the absence of mitochondria (RBC), the end product of
glycolysis is lactic acid.
The net reaction of Glycolysis (anaerobic) may be summarized as under
Glucose + 2ADP + 2Pi → 2 Lactate + 2ATP
7.1 Steps in EMP Cycle or Glycolytic Pathway

The Hans Krebs cycle, known by different names like the citric acid or tricarboxylic acid cycle, was named after the scientist Hans Krebs. The citric acid cycle is named after the citrate product formed in the cycle. The name tricarboxylic acid is given as citrate itself, which is a tricarboxylic acid due to the presence of three carboxyl functional groups (-COOH).
The tricarboxylic acid (TCA) cycle occurs in aerobic conditions and within mitochondrial ETC, involving various sequential oxidoreductase reactions. The cycle requires Acetyl-CoA (C2 molecule) and oxaloacetate molecule (C4 molecule) to begin with the formation of a citrate molecule (C6 molecule). Acetyl-CoA is generated from the pyruvate (glycolysis), the fatty acids (lipolysis), or by oxidative deamination of specific amino acids. The complete oxidation of a glucose molecule results in the end products like energy (ATP), CO2 and H2O. A molecule of Acetyl-CoA has two carbons. It is formed from a three-carbon pyruvic acid molecule generated from the glycolysis of a sixcarbon glucose molecule. Acetyl-CoA is the substrate for this cycle and is an energy-rich molecule having a thioester bond between coenzyme A and acetic acid.
8.1 Formation of acetyl-CoA from Pyruvic Acid
Pyruvate is obtained by glycolysis or the oxidation of glucogenic amino acids. The pyruvic acid produced in the cytoplasm crosses the inner membrane of the mitochondrion to enter the mitochondrial matrix, where it undergoes oxidative decarboxylation, forming Acetyl-CoA. Acetyl-CoA carries (carrier molecule) the acetyl group to the citric acid cycle. It also links various metabolic products with the TCA cycle. Such products can be from the EMP cycle, beta-oxidation, and oxidative deamination of amino acids. Oxidative decarboxylation of pyruvic acid needs a complex enzyme system known as pyruvate dehydrogenase

This alternative pathway for glucose oxidation has enzymes in the cytosol through which glucose is degraded to carbon dioxide. It is also called a shunt because carbon atoms from glucose 6-phosphate take a long route before they proceed down the EMP or glycolytic pathway. This pathway is anabolic in nature as it produces many intermediates. In this pathway, two NADPH are generated from one glucose 6-phosphate molecule. No ATP is generated or consumed.
Overall, this pathway needs three glucose-6-phosphate molecules to complete all the reactions. Therefore, one cycle run produces 2 mol of fructose-6- phosphate, 1 mol of glyceraldehyde-3-phosphate, and 3 mol of carbon dioxide from 3 mol of glucose-6-phosphate with the reduction of 6 mol of NADP+ to NADPH.
Overall reactions of the HMP pathway are as follows:
3 Glucose-6-P + 6 NADP+→ 3 ribulose-5-P + 3 CO2 + 6 NADPH
3 Ribulose-5-P → 2 xylulose-5-P + Ribose-5-P
2 Xylulose-5-P + Ribose-5-P → 2 fructose-6-P + Glyceraldehyde-3-P

The uronic acid pathway is a minor and alternative pathway for glucose oxidation and for the production of uronic acid sugar. Uronic acids of sugars are formed when the terminal carbon’s (C6) hydroxyl group (CH2OH) of sugar gets oxidized to a carboxylic acid. Uronic acid names depend on the name of the parent sugars. Uronic acid of glucose is glucuronic acid, hexose uronic acids are hexuronic acids, and pentose uronic acids are named penturonic acids. The uronic acid pathway is located in the cytosol of the liver and adipose tissue.
The glucuronic acid should not be confused with gluconic acid (aldonic acid) and glucaric acid (aldaric acid or dicarboxylic acid). Gluconic acid (aldonic acid or “onic” acid) is obtained from D-glucose by oxidizing its aldehyde group at C1 to a carboxyl group. Glucaric acid (aldaric or dicarboxylic acid) is formed upon oxidation of both the terminal hydroxyl groups (C1 and C6) and the aldehyde. They have two carboxylic acid groups. This pathway yields pentoses & ascorbic acid or vitamin C (not in primates & guinea pigs) from glucose.

Plants, with the help of photosynthesis, convert simple molecules (like carbon dioxide and water) into more complex molecules (anabolism) through various chemical reactions. Animals synthesize more complex molecules (anabolism) from monomer units through multiple chemical reactions. Anabolism refers to a biosynthesis process involving the sequences of biochemical reactions by which complex molecules are formed in living cells from available monomer units. Anabolic processes include the biosynthesis of complex biomolecules like carbohydrates, proteins, and lipids. The anabolic processes require energy from high-energy bond compounds like ATP.
The anabolic processes related to the biosynthesis of carbohydrates include
(1) Gluconeogenesis and
(2) Glycogenesis
11.1 Gluconeogenesis
Gluconeogenesis is the synthesis of new glucose molecules from noncarbohydrate molecules. The non-carbohydrate molecules that are used for gluconeogenesis are derived from glycolysis, lipolysis, and proteolysis. Examples are pyruvate, lactate, glycerol, and glucogenic amino acids. The liver and kidneys are the preferred organs for the gluconeogenesis process. It also occurs to some extent in the brain. Blood glucose levels are maintained at physiological concentrations through the process of gluconeogenesis in humans and ruminants. The blood glucose drops below normal levels during various conditions like fasting, starvation, pregnancy, lactation, fever, and low carbohydrate diets.

Glycogenesis helps to maintain blood glucose, as it is a primary source of energy for every cell. An inadequate supply of glucose to the body may lead to the failure of the vital organs. Glucose, when in excess, is synthesized into glycogen and stored (glycogenesis), mainly in the liver and muscles (including the uterus). It is also found in other tissues, such as the kidney, brain, heart, and adipose tissues. The stored liver glycogen is broken down (glycogenolysis) into blood glucose when needed. Still, the glycogen stored in muscle is broken down to glucose 1-phosphate and converted to blood glucose later. Either the synthesis or breakdown pathway is primarily active at a time in tissues. Glycogen synthesis and its breakdown are not reversible processes.
The percentage of glycogen stored in skeletal muscles is less ( 1% to 2%) than in the liver (10%). Still, the total quantity of glycogen is greater in muscles due to their greater mass than an animal’s total liver mass. Muscle mass, on average, ranges from 40 to 45 % of body weight for the most mature mammals.
Glycogen synthesis (glycogenesis) is an anabolic process forming a branched homopolysaccharide made of several chains of alpha D-glucose units linked by α-1,4 glycosidic bonds in a linear chain and nearly every ten glucose residues; the chain branches off via α-1,6 glycosidic linkages. The α-glycosidic bonds give rise to a helical polymer structure. The number of glucose units in a single glycogen molecule varies (1,700 to -600,000 units). The glycogen granules are formed on the glycogenin protein in the center, so it acts as a primer, and their number determines the total number of glycogen particles.

Glycogen breakdown is known as glycogenolysis. This breakdown occurs in the cytoplasm of cells of the organs, wherein glycogen is stored. The end product of glycolysis is glucose in the liver, which is glucose-1-phosphate in skeletal muscles.
Glycogen is a polysaccharide synthesized from glucose monomers. Glycogen is stored in the cell instead of glucose because glucose requires more water, whereas glycogen can be stored with much less water. Most of the stored glycogen is in the liver (5% of body weight) and muscle (1 to 2 % of body weight). Muscle and liver glycogen undergo glycolysis for different purposes. Muscle glycogen provides energy for muscular activity, whereas liver glycogen helps to maintain the blood glucose level.
Glycogen contains many glucose residues (up to 120,000) linked by alpha 1-4 glycosidic bonds, forming a straight chain. Glycogen has branches at alpha 1-6 glycosidic bonds at every ten glucose residues. At the reducing end, the carbon one of glucose is free, whereas it is not accessible in the case of non-reducing ends.

Carbohydrates (glucose) are the primary energy source for a body; when digested, glucose is the end product in human beings and simple stomach animals, but it yields volatile fatty acids in ruminants. Precise regulation of levels of blood sugars/glucose in the body is the net result of various processes like digestion, absorption, and metabolism operating under the interaction of various a) enzymes and b) hormones secreted by the different organs of the body. An abnormal secretion of any of the enzymes or hormones associated with the metabolism of carbohydrates disrupts the precise regulation of blood sugar, leading to various disorders.
14.1 Enzyme Deficiency and Disorders in Carbohydrate Metabolism
Usually, various enzymes are involved in the breakdown of carbohydrates, and if their secretion is insufficient, missing, or does not work correctly, it leads to different disorders.
I. Glycogen storage diseases (GSDs, glycogenosis, and dextrinosis)
Glucose is needed by the cells for the generation of energy and other cellular activities. If glucose happens to be in excess, it is stored as glycogen, mainly in the liver and muscles, for future needs. The stored glycogen can be converted back to glucose when the need arises. Many enzymes are related to this interconversion of glucose and glycogen. Deficiencies of one or more enzymes may lead to abnormal glycogen metabolism, leading to glycogen accumulation of normal or abnormal chemical structure in tissue, collectively called glycogen storage diseases (GSDs). Roman numerals identify different types of glycogen storage conditions. They are also classified under various categories like inherited metabolic diseases, autosomal recessive type, and X-linked type (VIII/IX type).

The number of hormones secreted by the body exhibits control over the physiological regulation of glucose sugar level (homeostasis) in the manner needed by the body. Depending upon the situation, hormones may increase or decrease the level of glucose sugar present in the blood or tissues. The glucose is oxidized to yield energy, carbon dioxide, and water.
Glucose, more than the body’s needs, is stored or converted mainly to glycogen and, to some extent, protein and fat. If glucose is less than the need of the body, its denovo synthesis takes place from amino acids or fatty acids, or is formed from the breakdown of stored glycogen. Various hormones are secreted by multiple endocrine glands to control the blood glucose level. If it fails, it leads to hypoglycemia or hyperglycemia conditions. Gluconeogenesis is not developed at birth in the case of a baby pig. Therefore, hypoglycemia in baby pigs is observed within 2 days of age if starved, leading to hypoglycemia, weakness, confusion, and death.
15.1 The Hormones Involved in Homeostatic Regulation of Blood

1.1. Introduction

Counselling is an intermittent, interpersonal interviewing process where the counsellor gives advice or suggestions to the client but never gives any direction. Counsellors assist the client in thinking, analysing, and acting to improve their insight power. The counsellor focuses on both the positive and negative sides of a particular event and allows the client to think and rethink its acceptability and unacceptability.

2.1. Introduction
The present century is the century of oxidative stress (OS) that linked to several life-threatening disorders which predominantly affect public health as well as their nutritional status. Unhealthy lifestyle and eating pattern which is major concern for OS. The biological literature first used the phrase “oxidative stress (OS)” in 1970. OS can be defined as a state of imbalance condition between the high level of pro-oxidants and the low level of antioxidant scavenging capacity in the body. The normal oxidative process that occurs in cells is crucial for the existence of life and favours the death of a cell. Free radicals, which are unstable, can form when molecular oxygen breaks up into pairs. This unstable radical has a high level of reactivity and produces reactive molecular species like reactive oxygen species (ROS) and reactive nitrogen species (RNS). In the context of health communication, ICT is referred to as Interactive Health Communication (IHC), which is the exchange of health information and advice and support regarding health-related matters between a consumer, patient, caregiver, or professional using an electronic device or communication technology. As for example, the transformation of raw food ingredients into consumable food products, entrepreneurship plays a key role in diversifying and commercializing agricultural products. It adds value of food, prolongs its shelf life, promotes the export of processed items, generates employment opportunities, boosts farmers’ earnings, and makes a significant contribution to the general development of rural areas. Health entrepreneurs like nutritionists, dietitians, physicians, and health counsellors run their practice and make it available for the client to listen to their problems and solve their problems through mental support, motivation, diet therapy, medication, and so on. As a result, the health burdens due to noncommunicable and communicable diseases are reduced.

8.1. Introduction
Micronutrients are vitamins, minerals, and nutraceuticals that do not provide energy and do not raise any sensation of hunger known as “hidden hunger” or “insensible hunger”. Hidden hunger that causes micronutrient deficiency affects 2 billion people globally. Due to the deficiency of micronutrients, different diseases are noted among public health professionals that reflect poor community nutrition. To overcome these deficiency-related diseases, one of the important approaches is food fortification. Food fortification is a public health policy to reduce the number of individuals, who suffer from micronutrient deficiencies within a population. Common examples include iodine-tagged common salt, vitamin A-containing oil, and iron-enriched rice all of which are examples of food fortification. In the agricultural field, food fortification (FF) and/or food enrichment (FE) is the most efficient strategy to overcome various micronutrient deficiencies by the addition of essential micronutrients (vitamins and minerals) to enhance the nutritional value of cultivated crops. According to World Health Organization (WHO) and Food and Agricultural Organization (FAO) of the United Nations (UN), “Food fortification” is defined as “the practice of deliberately increasing the content of an essential micronutrient, i.e., vitamins and minerals (including trace elements) in a food irrespective of whether the nutrients were originally in the food before processing or not, so as to improve the nutritional quality of the food supply and to provide a public health benefit with minimum risk to health” (Pant and Chinwan, 2014). “Fortificant” refers to the incorporation of substances in the food to provide micronutrients. “Micronutrients” refers to the important dietary components, including vitamins and minerals, that are required in very small amounts but are engaged in very critical roles in various body functions and disease prevention.

9.1. Introduction
The three basic need for human survival are- food, clothing and shelter. The requirement of food comes first. Human are omnivorous. They eat mainly natural foods. Before 5000 years ago, cereals were the main food for all civilization and then the complexity of life began to make appearing with the advent of industrialization, flourishing of industry and commerce. Unpolished grains were utilised at first, but in contemporary civilisation, we have begun to prepare them, which results in the loss of essential nutrients. The intake of meats, processed meals, and sugary goods has grown while the general intake of cereals has decreased. People now lack vital nutrients as a result of the departure from natural diets. People began to realise a few years ago that health is a significant concern in addition to flavour, convenience, and quality value. They have thus begun taking nutritional vitamin supplements to make up for the nutrients lost from processed meals. People are increasingly opting for natural nutraceuticals in capsules and tablets, a trend known as medicalization in nutrition, instead of relying on natural food items. Hippocrates emphasized the connection between food and medicine, stating that healthy foods has a strong therapeutic advantages. The ancient Indian medical system known as Ayurveda places a strong focus on the functioning of diet and nutraceuticals in both health and illness.
9.2. What are Nutraceuticals
Stephen De Felice, the founder and chief executive of the Foundation for Innovation in Medicine (FIM), first used the term “nutraceuticals” in 1989 to refer to the broad category of medicines and nutrition. Nutraceuticals are foods or dietary components that not only offer nourishment and energy but also significantly contribute to regulating and preserving the regular physiological processes that keep people healthy. Nutraceuticals included processed meals such as cereal-grains, soups or stews, genetically engineered foodstuffs, herbal items, nutritional supplements, and extracted nutrients. People are increasingly concerned about their healthy wellbeing these days. However, these include a hectic, sedentary lifestyle, unhealthy eating patterns, body image issues, and being afflicted by a number of illnesses. These are the factors driving the global nutraceutical market’s expansion and generating a lot of interest. Numerous health issues of the century, including cancer, type 2 diabetes, heart disease, inflammation, oxidative stress, constipation, and more, can be fought off with the use of these nutraceuticals. Overall, nutraceuticals bring an entirely novel phase in medical science and assist the food companies to promote more creative research strategies. (Dudeja and Gupta, 2017)).

Therapeutic Aspects of Drug-nutrient Interactions
Drug-nutrient interactions are expressed as physical, chemical, and pathophysiological relationships between a drug and a nutrient. This reaction is multifactorial. The drug has the potential ability to interact with nutrients which may lead to a reduction or enhancement of therapeutic efficacy, nutritional risk, and drug toxicity. Even such interactions lead to the discontinuation of drug therapy. But these kinds of interactions vary from person to person. Infants and children are the most vulnerable group in this concern as they are in the developmental phase where there is a lack of proper drug-metabolizing enzymes and inefficient renal function. Generally, DNIs signify negative impacts on human health but sometimes these interactions work in a positive way by reducing irritation in the GI tract or by increasing the absorption of drugs. Proper updated knowledge about DNIs is important for the appliance of diet therapy simultaneously with drug therapy as both of these are important strategies to manage or treat public health issues (Table 10.1., Table 10.2.).
