India has a population of one hundred twenty four crore plus and feeding this large a population calls for a strong FPI. The industry also assumes importance in the national economy due to the immense employment generation opportunities it offers and the export revenue it earns. Food Processing Industry (FPI) in India is a sunrise sector that has gained prominence in the recent years. Easy availability of raw materials, changing lifestyles and favourable fiscal policies has given a considerable push to the industry’s growth. FPI serves as a vital link between the agriculture and manufacturing sectors of the economy. Strengthening this link is critical to reduce wastage of agricultural raw materials, improve the value of agricultural produce by increasing shelf-life as well as by fortifying the nutritive value of the food products and ensure remunerative prices to farmers as well as affordable prices to consumers. The industry has very low processing level i.e., 2.2% for fruits and vegetables, around 35% in milk, 21% in meat and 6% in poultry products, which is significantly lower by international standards. For e.g., processing of agriculture produce is around 40% in China, 30% in Thailand, 70% in Brazil, 78% in the Philippines and 80% in Malaysia. Value addition to agriculture produce in India is just 20% with wastage estimated to be valued at around US $13 billion.

India has the second largest producer of food with arable land of 159.65 million hectares and has the highest acreage under irrigation. Next to China, India ranks second largest food producer in the world and has the potential to immerge the biggest with its food and agricultural sector. India accounts for less than 1.5% of international food trade despite being one of the world’s major food producers, which indicates huge potential for both investors and exporters. A large number of people in developing countries have traditionally depends on products derived from plants, especially from forests, for curing human and livestock ailments. Additionally, several aromatic plants are popular for domestic and commercial uses. Collectively they are called medicinal and aromatic plants (MAPs). About 12.5% of the 4,22,000 plant species documented worldwide are reported to have medicinal values. With dwindling supplies from natural sources and increasing global demand, the medicinal and aromatic plants, will need to be cultivated to ensure their regular supply for processing and value added products.

The term “Medicinal and Aromatic plants” generally denotes those non-aromatic and aromatic plants, which are used for medicinal, perfumery, dye and cosmetic purposes. They are rich in secondary metabolites and are potential sources of drugs. Generally the whole plant roots, stem, bark, leaves, flowers, fruits, gums and oleoresins, etc. are used.

India has been considered as treasure house of valuable medicinal and aromatic plant species. Ministry of Environment and Forests have identified and documented over 9500 plant species considering their importance in the pharmaceutical industry. In the present context of ‘back to nature’ in health care, it is relevant that these valuable plant species are not only preserved but also their cultivation developed in order to meet the entire demand of the domestic industries as also to exploit the bright prospect for export. Shift from collection to cultivation of medicinal & aromatic plants will also ensure purity, authenticity and sustainable supply of raw materials required for herbal drugs, including polyherbals.

Tropical fruit tree are important crops which supplement and improve the quality of diet. Many of the species have multi-purpose uses in that they produce non food products such as fuel, timber, fodder, medicines and industrial products for small holders. Harvesting from these trees enable rural people to provide nutrition for a balanced diet and generate income thus alleviate poverty. Tamarind (Tamarindus indica L) can be found throughout much of the tropics, it is grown unattended in backyards, roadsides or waste lands. Tamarind is ideally suited for avenue plantings as a roadsides tree, in and around villages as a multipurpose species for agro-forestry system or as protective firebreaks for forest margins. It is a valuable timber species widely used for making furniture, tool handles, charcoal, oil mills, rice pounders and fuel wood. The leaves are an important source of food and herbal medicine and the edible pulp of ripe fruits is used as a flavouring agent in cooking, soups, jams, chutneys, sauces, pickles etc. The fruit pulp of tamarind forms the “Tamarind of Commerce”. The name tamarind is derived from the Arabic word ‘Tamar-u’l-Hind’ because the dark brown pulp of the fruit was thought to resemble dried dates. It was therefore called the Tamere-hindi or ‘date of India. The production of Tamarind in India was estimated 201000 tonees for year 2017-18 (Horticulture statistics, 2018), India is the world’s largest producer of tamarind products. It is particularly abundant in the India states of Madhya Pradesh, Bihar, Andhra Pradesh, Karnataka, Tamil Nadu and West Bengal. The production in India is mainly concentrated in the drier southern states and the produce is collected by the villagers and sold in the market. In India, the average production of tamarind pods per tree is 175 kg and processed pulp is 70 kg/tree (Kulkarni et al., 1993).

Mushrooms are good as nutritious food for all ages and under all conditions of health. The mushroom is a fleshy, space-bearing organ of non-green edible fungi. Its fleshy nature of mushroom is responsible for its main attraction to human being as a source of food. Like other fruit and vegetables, mushrooms are soft textured and highly perishable in nature. Mushroom are potential sources of nutrients. They can convert nutritionally valueless substances into high fat and protein food. Mushroom proteins are comparable to muscle protein in nutritive value. Being a good source of vitamins and proteins it is considered be a distinct food. The digestibility of protein in these is 72-83%. Mushrooms are edible fungi; assume considerable importance in human diet as they are good source of non starchy carbohydrate, dietary fibre, minerals and vitamins-B and essential amino acids. Mushrooms are popular their delicacy and flavour rather that food value. However, it is now a well-established fact that they are excellent sources of vitamins and minerals (Vijaya Khader, 1988). The vitamins in mushroom are well retained during cooking, canning, and dehydration. The White button mushrooms (Agaricus bisporus), Shiitake mushroom (Lentinus edodes), Pleurotus species (Pleurotus osteatus, P. flabellatus, P. sajor caju etc.), Paddy straw mushrooms (Volvariella volvacea), Winter mushrooms (Flammulina velutipis), Jew’s ear mushrooms (Auricularia polytricha) are commercially cultivated species of mushroom. In India, mainly three species viz., white button, oyster or dhingari and paddy straw mushrooms are commercially cultivated at large scale.

Ginger is used extensively as a spice in cuisines throughout the world. Ginger belongs to Zingiberaceae family and an English botanist William Roscoe (1753-1831) gave this plant the name Zingiber officinale in the year 1807. The name of the genus Zingiber derives from a Sanskrit word denoting “horn shaped” in reference to the protusions on the rhizomes (Ghosh et al., 2011). It is an oldest rhizome widely domesticated as a spice where the edible part is the swollen underground stem or rhizome. The Zingiberaceous plants have strong aromatic and medicinal properties and are characterized by their tuberous or non-tuberous rhizomes (Chen et al., 2008). Ginger is a medicinal plant that has been widely used all over the world, since antiquity, for a wide array of unrelated ailments including arthritis, cramps, rheumatism, sprains, sore throats, muscular aches, pains, constipation, vomiting, hypertension, indigestion, dementia, fever and infectious diseases (Ali et al., 2008). Ginger has direct anti-microbial activity and thus can be used in treatment of bacterial infections (Tan and Vanitha, 2004).

Chicory (Cichorium intybus L. var. sativum D.C.) plant is the herbaceous, perennial plant and supposed to have descended from the wild chicory (wild succory, blue sailors) which is often seen along roadsides with its blue flowers. The leaves are used as salads in human diet and other different purposes. They were reported to be stomachic (Baumann 1982, Franke, 1981) and their juice was used against eye disease and poisoning. The infusion of chicory was believed to be good for the liver, kidney and stomach. Initially the wild plant was used but since approximately 300 B.C., the crop was cultivated for this purpose. Beverages, soups and sauces made of chicory were reported to be used in Italy and Belgium as early in 16^th century.

For the first time, the root of chicory was used as a substitute of coffee in 1690 in Holland followed by many other countries like Sweden, France, etc. During 1806 and 1813, the cultivation and use of roasted roots of chicory as coffee substitute spread over the whole European continent. In the 19^th century, the main centres of cultivation of chicory were North-East France, Belgium, England, Russia, Holland and Australia. Subsequently it was raised on large scale in Poland, Hungary, Germany, Switzerland and India. Presently over 20% of the World’s consumption takes place in Eastern Europe, especially in Poland (6%) followed by Russia, Hungary, Romania, Czechoslovakia and East Germany. Twelve percent is reported to be consumed in South Africa, 9% in India and 2% in the United States (Clark and Macrae, 1987).

Cape gooseberry is the native of Peru and Chili (South America), but widely cultivated in Cape of Good Hope and hence called so. It is known by different name in various parts of the world. It is commonly called ‘Poha’ in Hawaii; ‘Golden berry’,’ Pompelmoes’ or ‘Apelliefie’ in South Africa; ‘Lobolobophan’ in the Philippines. In India it is commonly called ‘Rasbhari’, ‘Makoi’, ‘Tiparee’ or ‘Tepari’. Cape goose berry (Physalise peruviana L.) belongs to the family solanaceae. Out of 80 species of genus physalis, only three are well known for their fruit value. These are: (i) P. pubescen L. (ii) P. Peruviana L., and (iii) P. ixocarpa Brot. However these three species, Physalise peruviana L is the most popular due to its pleasant flavour and acid-sweet taste.

Ber (Ziziphus maruritiana Lam.) is cultivated all over the desert part of the Indian subcontinent for its fresh fruits, which are rich in vitamin C, vitamin A and vitamin B-complex and minerals. It can be successfully cultivated even in the most marginal ecosystems of the subtropics and tropics. Ber or Indian jujube belongs to the genus Zizphus of the family Rhamnaceae and order Rhamnales. Ber is adopted to ecologically poor, drought prone areas, which encounter recurrent crop failures and thereby economic crises. It yields nutritious fruit, rich in vitamins and minerals than apple even in drought years and its cultivation is highly cost effective owing to very low input requirement. Ber cultivation also provides employment for people in different farm operations for production and sale of the produce. In India, Haryana, Punjab, Uttar Pradesh, Rajasthan, Gujarat, Madhya Pradesh, Bihar, Maharashtra, Andhra Pradesh and Tamil Nadu are major ber producing states. The area under cultivation with this fruit is 8.7 lakh ha with an annual production of 8.9 lakh tones in India (Baloda et al., 2012). About 125 varieties of ber are available in India. A few of these varieties are known for taste, size, amount of pulp and higher yields. The cultivars Umran, Kathapal and Gola are the most promising varieties of ber in North India (Azam-Ali et al., 2001).

Nutritive Value

Many people are unaware that the ber is one of the most nutritive fruit, since ber is a common fruit. It is one of the richest sources of vitamin C, next only to aonla and Guava but better than citrus fruit and apple. The fruit pulp contains 13-20% total soluble solids and 0.20-0.80% acidity at fully ripened fruit. Ripe fruit of Umran contains 117 mg ascorbic acid/100 g of pulp. Ber fruit contains β-carotene (vitamin-A) at 81 µg/100 g of fruit, 5.6% sucrose, 1.54% glucose, 2.08% fructose, 1.00% starch and 1.13% total carbohydrates. Due this, so ber is often called the “poor man’s fruit”. Table 1 represent the nutritional composition of different ber varieties.

A sustainable and healthy food system is one which can provide food and nutrition security for all, in an economical way which is socially and environmentally sound for future generations. Underutilized indigenous and traditional crops can support and strengthen the existing food system, as they are in particular economical and friendly with the environment. Several underutilized indigenous and traditional crops are nutrient dense and adapted to marginal conditions, suggesting that they could be used to champion sustainable and resilient agriculture and food systems for smallholder farmers residing in these environments. The mainstreaming of underutilized indigenous and traditional crops and foods should be recognized for their attributes to make them desirable and to conserve them. In this regard, the fact that value chains for underutilized indigenous and traditional crops are poorly developed at present has created many opportunities to diversify the current food systems. This will create a new employment, market and distribution opportunities.It will also help to combat poverty. It will be if the smallholder farmers and women in rural areas are given the opportunity to utilize underutilized indigenous and traditional crops and re-enter the manistream system. A significant role which is played by the women for the production and conservation of underutilized indigenous and traditional crops offers opportunities for women empowerment through their inclusion in the food system. Promotion of gender equality and empowerment of women is directly linked for strengthening the sustainable food systems that can fight hunger and malnutrition and improve the lives and livelihoods of rural populations. The mainstreaming of underutilized indigenous and traditional crops into the food system would support women to diversify in a sustainable way, feed their own households and to provide nutritious food into the local markets. Benjamin et al., (2016) have focused on the small-scale food processing enterprises (SSFPEs) as one of the important measures for national development and addressing food security challenges, particularly in Nigeria. The authors have explained the need for food processing as there has been tremendous food losses and wastages in the country. Enhancing the food processing and productivity for mechanization of food processing unit operations, development of new and existing technologies, design and development of machinery, systems for processing and preservation of different agricultural produce of high target have been undertaken. SSFPEs have played an important role in the economy of a developing country, particularly in terms of employment creation, income generation, post-harvest losses reduction, food preservation, value addition, improvement of food safety, nutritional quality, increase in shelf-life of a product and to act as training grounds for entrepreneurs before they invest in large scale enterprises. SSFPE’s around the world and especially in Nigeria are faced with significant challenges that compromise their ability to function and contribute optimally to the economy. Financial constraints and lack of management skills are the major constraints. It is important that governments and non-governmental organizations must encourage and facilitate the development of SSFPE’s. Mother’s Recipe is a brand which make traditional pickles in bottles with a distribution network to 20 states in India and exporting the products globally. The manufacturing is done in-house and the raw materials are procured seasonally in large quantities. After cleaning they are cut according to the recipe. Each variety of mango pickle has its own cutting process. Some are automatically cut, while others need manual work. The use of right oils, spices roasted inhouse, and marination of the pickles according to the practices of the particular region allow many consumers to relish them. The geographical location of India helps in the export of items to other countries. It is connected to Europe, Middle East and Africa from the western coast and to Japan, Singapore, Thailand, Malaysia, Korea, Australia and New Zealand from the eastern coast. Food processing is a priority sector for the Indian Government, especially in recent times with “Make in India” initiative.The country is considered as one of the most favourable markets because of the easy and affordable credit and other fiscal incentives. The total consumption of food and beverages in India is US$ 369 billion which is expected to increase to US$1.142 trillion and the output in the food processing sector might increase to US$ 958 billion by 2025. This offers a vast market opportunity by the Indian food processing, food retail, transport, logistics and related infrastructure sectors to players in the food processing value chain. Food fortification is the procedure in which micronutrients (essential trace elements and vitamins) are added to the food. As a public health policy fortification can be carried out by the food manufacturers or by the governments to help people in combatting dietary deficiencies within a population. Fortification can be done in food even if these nutrients are originally present or not. However, it improves the nutritional status of a population by overcoming the deficiencies of micronutrients. The best solution to this is the utilization of indigenous and traditional crops which will bring a transformative change in the food system. There is a need to look into the development of smallholder producers. The agro-industrial food system has improved the food supply and has made way for significant trade-offs with agro-biodiversity, dietary diversity, environmental sustainability and socio-economic stability mainly amongst the rural poor. Now is the time to mainstream the underutilized indigenous and traditional crops into the food system. This will provide opportunities to develop a sustainable and healthy food system.It will also help towards the societal goals which include employment creation, wellbeing and environmental sustainability.

Indian Spices: These are dried, fragrant, aromatic or pungent vegetables or plant substances. They can be whole, broken or in ground forms. Primary function in food is seasoning rather than nutrition and which contributes to the flavour and piquancy in foods and beverages. To look into the nutritional security around the globe, FAO and WHO, have undertaken the analysis of policies. They have covered many issues which include; World Summit on Food Security, pillars of food security and availability, access, utilization, stability, effects of food insecurity, stunting and chronic nutritional deficiencies, depression, anxiety and sleep disorders. There are many challenges to achieve food security. These include global water crisis, land degradation, climate change, agricultural diseases, food versus fuel, politics, food sovereignty, food wastes, risks to food security, population growth, fossil fuel dependence, homogeneity in the global food supply, price setting, land use change, global catastrophic risks, agricultural subsidies and role towards children.

We get energy from food. We need energy for all the activities which we get by eating. The body structures as muscles, organs and bones are composed of the nutrients contained in food which are absorbed by the body.

Nutritional requirement of the major nutrients

Nutrients are the substances which are found in food and drive biological activity. They are essential for the human body. If the food is heated the process is called as extrusion cooking. It is a process which combines several unit operations including cooking, mixing, kneading, shearing, compressing, shaping and forming. Extrusion adds a variety to the products by changing shape, size, texture and even some of the minor ingredients of the food and at a reduced cost than most of the other processing methods. Extrusion cooking (not extrusion) is a high temperature short time (HTST) process that reduces microbial contamination and inactivates enzymes.

Before beginning the actual work on the establishment of a Fruit and Vegetable Processing Industry the following points should be considered:

Availability and possibilities of obtaining Funds: Investment of own money or obtaining loans from banks etc.

The scale of industry (Large, Small, Cottage or Home): Has to be decided based on availability of raw material, funds availability, land, labour and other resources.

The location: The processing unit should be located near to the actual production site of raw material so that the transportation costs of high bulk raw materials is reduced. There is no fun or justification of establishing apple processing industry in Lucknow or Bangalore and mango processing industry in Shimla as the related raw materials would have to be transported through long distances.

Site: Site selected in the location should be sunny area free from dampness and sufficient space for waste disposal should be ensured.

In a commercial horticultural enterprise, if the product is not marketed properly, safely and beneficially, all the investment, inputs, hard work goes in vain. Basically every commodity that is produced should reach the consumer and marketing is all about how the commodity reaches the consumer. There is no fun of producing any commodity if it does not reach the consumer.

The word market has been derived form Latin word “marcatus” meaning merchandise, where people conduct business. Market therefore refers to place where goods/ commodity and services are bought and sold.

Marketing is a sum total of business activities through which the goods and services are either bought or sold. Cundiff and Still defined marketing as “the business process by which products are matched with markets and through which transfer of ownership are affected.

Why Marketing of Fruits and Vegetables is Complex and Risky as Compared to Other Goods

Spoilage may be defined as the deteriorative process which renders the food inedible or results into reduction of quality.

Spoilage is Mainly of Two Types

Abiotic Spoilage: Less potential for causing health hazards to consumers. Occurs due to

Enzymes are biocatalysts that change the rate of reaction without being changed themselves. All (Most) enzymes are proteins but all proteins are not enzymes. Ribonuclease is the enzyme which is non- protein in nature.

Alcoholic Beverages

These are the beverages which are prepared after alcoholic fermentation of sugars by yeast, contain varying amounts of ethyl alcohol (5-42%), and are consumed directly or after dilution in water.

Wine : Product made by alcoholic fermentation of grapes or grape juice unless otherwise specified, by yeast (Saccharomyces cerevisiae and a subsequent ageing process. Alcohol content is 11-14 %, but may be as low as 7%.

Beverage: It includes all drinks whether they are fermented or unfermented, prepared from fruits or non-fruit, sweetened or unsweetened eg. tea, coffee, coca cola, cider, maaza are all beverages.

Fruit Beverages : Beverage which is prepared partly or fully from fruit juice or pulps with or without additives eg. pure fruit juice, squash, cordial, RTS beverage etc.

Non-fruit Beverage : Beverage which does not contain any fruit part eg. Coca cola, pepsi, sherbet etc.

Unfermented Juice or Pure Fruit Juice: This is the natural juice pressed out of the fruit and practically its composition remains unaltered during preparation and preservation. No additives like sugar, acid, water etc. are added. eg apple juice, orange juice.

Fruit Juice Beverage: This is the fruit juice that has been considerably altered in composition by adding water, sugar, acid, flavour, colours, preservatives etc. before consumption. It may or may not be diluted before it is served as a drink eg. squashes, nectars, appetizers etc.

Freezing : Freezing is a process where temperature of food (fruits, vegetable etc.) is lowered down considerably below freezing point so that the water present inside the food undergoes change in state from liquid to solid (ice) and gets frozen immediately eg Frozen Pea. Water is immobilized and solutes are concentrated to reduce the water activity.

Principles of preservation : Combination of low temperature, low water activity, and pre-treatments like blanching, dipping in sugar syrup etc. stop (reduce) the growth and activity of microorganisms.

Theory of freezing : Freezing takes place in two main steps

Drying/ Dehydration means the process of removal of water.

Drying : Removal of water (moisture) by using non conventional energy sources like Sun or wind.

Dehydration : Process of removal of moisture by the application of artificial heat under controlled conditions of temperature and / or humidity and air flow.

Canning : Process of preservation of various food stuffs including fruits and vegetables whole or in pieces, in sugar syrup or brine by heat processing them in hermetically sealed containers.

Jam : It is a product prepared by boiling to a suitable consistency, fruit pulp with sufficient quantity of sugar, acid and pectin so as to set and become firm enough to hold the tissues in position. About 45 parts of pulp are used with every 55 parts of sugar. The finished product should not contain less than 68 per cent total soluble solids.

Jelly : Jelly is prepared by boiling the fruit pectin extract with sugar in the presence of appropriate amounts of acid so as to set into a clear gel. A perfect jelly is transparent, devoid of haziness or any suspended material well set, but not too stiff and should have original flavour of the fruit. When cut it should retain its shape and show a smooth cut surface.

Marmalade : It is a fruit jelly like product in which slices of fruit or peel are suspended in the set gel. Mostly they are prepared from citrus fruits like oranges, lemons etc.

Pickles known to be good appetizers, aid digestion and pallate are edible products preserved and flavoured in a solution of common salt and vinegar. Spices and oil may also be added. There are a number of pickles very popular in India i.e. mango pickle, cauliflower pickle, lime and lemon pickles, ginger chilli pickle etc. But, some pickles like Sauerkraut are not very common in India but are very popular in European countries.

Essentials for Quality Product Preparation

Plant ripened red tomatoes should be selected. Yellow and green fruits on processing yield dull colour and turn brown due to oxidation.

Never use iron equipment for processing. Lycopene oxidizes and turns brown when comes in contact with iron. It also forms black compounds with the tannins present in tomatoes or the spices which are used for product preparation.

Avoid prolonged heating and cool immediately to avoid over-cooking.

Nature has made such a beautiful system that a fruit does not spoil unless its outer covering is removed and till it is there on the plant. For example banana will not spoil for long time if we do not remove its peel. Similar is the case with apple, guava, mango and many other fruits and vegetables. But as soon as the outer covering is removed the damage begins and the commodity is spoilt very soon.

Preservation is extending shelf life of fresh or processed food by using various methods and prevention or reduction of spoilage. Better the preservation, lesser the spoilage, more the spoilage poorer and inefficient is the preservation.

Therefore, in order to prevent or reduce the spoilage, we have to first identify and understand the causes of spoilage. There are chiefly 3 agencies that cause spoilage in fruits and vegetables i.e. (i) microorganisms, (ii) enzymes & chemical changes and (iii) man, animals, rodents, insects, etc. For effective preservation we have to check the growth and activity of these spoilage causing agencies. So, in order to prevent spoilage and preserve a perishable commodity for long time the following principles and methods are to be followed.

Packaging : Packaging of fruits, vegetables, flowers or any other commodity is chiefly done to assemble the produce in convenient units of different sizes, shapes & types for storage, transportation, marketing and distribution. The size of units may vary depending on the requirement e.g for retail marketing smaller units are preferred and for bulk transportation and storage, large units would be more convenient.

Why do we Require Packaging?

Imagine there is no packaging material and technology available. How we are going to transport apple, mango etc. to distant markets? Definitely as loose. Then how can we weigh or count the fruits being transported or marketed? This would be very difficult. Had there been no packaging the commodity would have suffered great physical, chemical and microbiological losses. It would have been very difficult to handle, manage, transport and market the produce as loose and unpacked. Therefore, the packaging of fresh as well as processed commodities was needed to contain, unitize and protect the produce.

Storage : It can be defined as keeping the commodity fresh or processed in safe condition with minimum of deteriorative changes for later use.

Harvesting : Harvesting is detaching a commodity from the point of its origin. This point of origin may be an above ground plant part i.e. shoot eg. apple, tomato etc. or an underground plant part eg potato, carrot, etc. or in water i.e. harvesting of fish from a pond (not to be covered in this book).

Physiological Development

Fruits and vegetables can be divided into 3 stages based n their physiological development i.e. growth, maturation and senescence.

Growth: This generally refers to cell division, enlargement and differentiation ultimately giving a particular size, weight and volume to the commodity.

Maturation: It is initiated before the ceasation of growth and lasts till the onset of senescence.

Senescence: The stage when anabolic (synthetic) processes almost terminate and catabolic (degradative) processes are initiated and speeded up causing ageing and finally death of tissues.

Ripening: Stage that begins with the last stages of maturation and lasts till the beginning (first stage) of senescence. Ripening is a very important event in the life of a plant as it transforms a physiologically mature but inedible (or not preferred to be eaten) plant part into an edible, visually and olfactorily attractive and tasty commodity. Ripening marks the completion of developmental phase and is an irrevessible event.

India, one of the largest food producer countries (I in milk production, II in fruit and vegetable production and III in food grain production at world level), possesses the potential of being the biggest with the food and agricultural sector contributing around 26 percent of the Gross Domestic Product (GDP). It is a paradox that people of the country producing such huge quantities of food including fruits, vegetables, milk, cereals grains etc. are still suffering from many nutritional deficiencies in their diet, and even in some places, the stomachs of people remain unfilled for the want of food. The credit of this would predominantly go to the poor postharvest infrastructure as well as knowhow and accessibility to the facilities. All this makes us one among those countries having largest postharvest losses. The reduction of losses occuring during food handling, processing, storage, distribution and use would be an indirect way of increasing the food production and making the country self-sufficient in nutritional requirements.
