Introduction

Pulses are annually grown leguminous crops that yield one to twelve grains/ seeds within a pod, and are often promoted in diet owing to their low cost and many beneficial nutritional effects (Craig 2009). The United Nations general assembly has declared 2016 as the international year of pulses (Oyeyinka et al. 2016). The Food and Agriculture Organization (FAO) describes pulses as the crops that are harvested only for dry grain. This definition excludes crops that are harvested green as food sources (such as green beans and green peas), crops that are used only for sowing purposes (such as alfalfa and clover) and crops used primarily for oil extraction (such as peanuts and soybean). India is the largest producer (around 25%) of pulses in the world and the Indian subcontinent covers the leading area in terms of consumption of pulses. It was also suggested that India can also increase the production output by 30%, considering a rise in government support prices for stimulating the growth of pulses and in case of a normal monsoon season (FAOSTAT 2008). The mainly grown pulses in India include mungbean (green gram), chickpea (Bengal gram), urd bean (black gram), lentil (masur), pigeon pea (arhar), cowpea, horse gram and peas (Tiwari and Singh 2012). In the western countries, nowadays pulses are one of the preferred food sources of the population, owing to ideological reasons and interest in vegetarian diet.

Introduction

Functional elements are non-conventional biomolecules in foods that have the ability to modulate one or more body metabolic processes or pathways, leading in health advantages and well-being promotion. Research has demonstrated a connection between food, health and well-being functional elements. Consequently, functional elements have health-promoting roles connected with multiple progressive steps at various phases of disease control, from initiation to growth. They can therefore be implemented efficiently in disease therapy and prevention. Therefore, the borderline between food and medicine is becoming very thin at a moment when the role of a healthy diet in stopping non-communicable diseases is well recognized. Functional elements include plant-derived, non-nutritious and biologically active chemicals that operate in the body to avoid certain non-communicable diseases from occurring.

Food contains over 900 phytochemicals. One fruit or vegetable serving (about 120g) can contain as many as 100 distinct phytochemicals. Previously, functional elements were believed to happen predominantly only as phytochemicals in plant products including whole grains, fruits and vegetables. However, in animal goods such as milk, fermented dairy products and cold water fish, probiotics, conjugated linolenic acid, long-chain omega-3, −6 and −9 polyunsaturated fatty acids and bioactive peptides are also discovered. Usually, functional elements happen in various forms in food such as glycosylated, esterified, thiolated or hydroxylated materials. They also have numerous metabolic operations that enable positive impacts in the body on several illnesses and target tissues (Balic et al. 2020).

1. INTRODUCTION

The paradigm of world’s livelihood is built on the basic foundation of natural resources which includes humans, plants, animals, soils and minerals, water and air. But the very livelihood of these resources are at stake because they are strongly linked and dependant on each other. And to add, the material resource namely ‘economy’ has invaded the tranquil habitat and life of the community of natural resources. Thus the present crisis is challenging livelihood of each of these natural resources whether it is human, plant or water or earth and the element of economy is interfering with the natural recourse of human depending on water and soil; and human, plant, animal together are depending on soil, water and air. But when the livelihood of soil, water and air is at stake how human, plant and animal can survive; hence the design of livelihood of world has the essential ingredients of all natural resources.

We humans are selfish and concerned about our livelihood security only and try to over-exploit other natural resources and assumed themselves as the master of all natural resources. Practically, there is war going on between and among natural resources. The world could be better if each natural resource has its own right with prospects to safeguard its livelihood and all resources together with better livelihood could offer the lively world.

2. UTILIZATION OF NATURAL RESOURCES

We should underscore that none of the natural resources are in ‘plenty’ and that we should ‘economize’ on each natural resource to build together the world’s livelihood. The food security of humans can not be attained without plants and plant security can nor be achieved without soil and water and it is impossible to keep secured soil and water without economics of management.

In short, the livelihood security of humans is entirely dependant on all other natural resources coupled with the material resource economy. It is incumbent on us to initiate appropriate steps from gross root to policy levels to make the world better.

Introduction Millets, once considered as humble and forgotten grains, have made a remarkable comeback owing to their numerous health benefits, sustainability, and resilience in diverse agroclimatic conditions. Millet consumption is gaining momentum globally and thus it becomes imperative to establish clear and comprehensive standards for these grains. The chapter gives an insight into the reasons why millet standards are necessary, the challenges associated with implementing such standards and advocacy for a concerted effort to promote these nutritious grains as staples in our diets.

Society is dynamic. The requirement of society varies in course of time. During the life process human being faces lots of health hazards which are mostly due to intake of various foods. So people become cautious about the intake of food and think about the quality of foods which can protect the health of human being. In ancient times people made medicines from plant extracts to protect their health. In 1989, Dr. Stephen coined the term “Nutraceuticals” which is combination of nutrition and pharmaceutical. Nutrition is required for health and pharmaceuticals provide remedy for sickness. So it is a preventive approach. Nowadays, the definition of nutraceuticals has been expanded to include vitamins, minerals, herbs and other botanicals, amino acids, and dietary substance for human use as a supplement diet (Stauffer, 1999).

Nutraceuticals are dietary supplements made only from whole foods to augment health. Currently over 470 nutraceutical and functional food products are available with documented health benefits (Brower, 1999). The patients are much aware about the side effects of chemical agents in short and long term therapy. So to avoid medicine used for small diseases, new therapies came into trend with the help of nutritional approaches i.e. “Nutraceuticals”. The use of nutraceuticals becomes easier than pharmaceuticals since nutraceuticals does not require any animal verification for its use in human. Nutraceuticals,

1. INTRODUCTION

Wine is an ancient fermented product as revealed by the wine jugs recovered (Plate 1) during excavation from different places. Wine is made all over the world and wine produced in each region from different parts of the world has different characteristics. Development and implementation of practices and policies for sustainable growth of grapes and other fruits is the most essential component for the growth and development of wine industry. The science dealing with wine production, evaluation and consumption is known as 'Oenology'. For the introduction of wine, several aspects influence the wine quality are style, the consumer perception and finally, the marketing are taken in account. Factors related with fruit growing, ripening, micro organisms and other verification factors need to be considered in wine production.

Introduction

The gut microbiota is the complex and dynamic community of microorganisms that includes various bacteria, fungi and other microorganisms, proliferate and lead a symbiotic/mutual relationship with the host system. These microorganisms protect the host against pathogens by unique mechanisms, helps to maintain shape and strengthen the intestinal epithelium and boost immune response. Diverse bacterial metabolites can immigrate the host bloodstream and other parts of the body via various channels in humans and animals, such as gut-microbiota-brain, gut microbiota-skin, gut-vagina, gut liver, gut-bones etc. However, many aspects of modern lifestyle would alter the gut microbiota and lead to numerous diseases including inflammatory bowel disease, diabetes mellitus, obesity, and metabolic syndrome. Probiotics and other beneficial microbes exert many beneficial effects on their hosts by modulating the gut microbiota. While the term probiotic is reserved only for well-characterised strains with clinically proven health benefits, other beneficial microorganisms include, organisms responsible for the fermentation of foods viz. yogurt, kefir, kombucha, kimchi and many others that have been shown to have distinct health benefits. Interestingly, major group of these beneficial organisms belong to lactic acid bacteria.

Abstract

Though India is second largest producer of fruits and vegetables but is far behind in per capita availability of this protective food as compared to many developed countries. Floriculture and allied horticulture crop production (spices, medicinal & aromatic crops, mushroom etc.) have great potential to generate high income, jobs and new careers. Hi-tech horticulture is the need of all the developing countries and it refers to “the precise production techniques for efficient use of inputs at appropriate time and quantity for maximization of yield and quality of crops”. Various ways to make horticulture hi-tech include modern nursery management including micro propagation, protected crop production, high density planting including canopy management, use of agrochemicals, rejuvenation technique, interated nutrient management, integrated water management, integrated pest and disease management. Inspite of this, in present context, major emphasis has been given on clean horticulture production with bio-derived, renewable energy sources for developing a profitable CEA (controlled environment agriculture) that would help in sustaining the system, improving socio-economic status of growers and of-course environment-friendly.

Technological advancement, increased urbanization, awareness and interest of consumer for variety products have given a great challenge to the food sector to develop inexpensive foods that are nutritionally superior and acceptable to the intended consumers. Keeping this objective in view, we have made an attempt to develop technology for variety products from wheat and corn and suitability of available varieties judged. With the emerging trends of food market towards fast foods, there are vast prospects for efficient utilization of cereals by exploring varieties products. A steamed bread (a Chinese traditional product) and Tortilla and corn chips (Mexican snacks) were developed. Steamed bread is defined as the product resulting from cooking or steaming fermented dough. Recipe and method for its preparation was standardized. Nutritionally rich steamed bread can be prepared by supplementing 10% level of chickpea and defatted soybean flour. Corn snacks have become a prime target of some consumer advocates and nutritionists who have referred them as a source of ‘empty calories’. But reality is that these snacks provide instant energy, as they are rich storehouse of nutrients. Process and recipe for the preparation of Tortilla and corn chips from Indian maize were standardized. The quality and acceptability of these snacks were worked out and found that these products were highly acceptable. Indian consumers have versatile taste, so these products will be readily accepted in Indian market. 

Nitrogen assimilation is the formation of organic nitrogen compounds like amino acids from inorganic nitrogen compounds present in the environment. Organisms like plants, fungi and certain bacteria that cannot fix nitrogen gas (N₂) depend on the ability to assimilate nitrate or ammonia for their needs. Other organisms, like animals, depend entirely on organic nitrogen from their food.

Plants absorb nitrogen from the soil in the form of nitrate (NO₃ ^-) and ammonia (NH₄). In aerobic soils where nitrification can occur, nitrate is usually the predominant form of available nitrogen that is absorbed. However this need not always be the case as ammonia can predominate in grasslands and in flooded, anaerobic soils like rice paddies. Plant roots themselves can affect the abundance of various forms of nitrogen by changing the pH and secreting organic compounds or oxygen. This influences microbial activities like the interconversion of various nitrogen species, the release of ammonia from organic matter in the soil and the fixation of nitrogen by non-nodule-forming bacteria.

Abstract

Ghee means the pure clarified fat derived solely from milk or curd or from desi (cooking) butter or from cream to which no coloring matter or preservative has been added. It is the second largest dairy product prepared from milk and it is almost 35% of total milk production. Unfortunately, the producers or the middle- men involved in the ghee trade, tend to adulterate ghee with cheaper oils and fats like vegetable oils, animal body fats, hydrogenated fats and sometimes even the non-edible mineral oils, especially during lean season to earn more money. Recently, the problem of adulteration has assumed a very serious dimension. Such a situation has tarnished the image of dairy industry. Methods presently adopted by food law enforcing agencies to ensure the quality of ghee are mainly based on the physico- chemical constants, but all these methods have some limitations. So researchers are always in search of different innovative methods to check the quality of ghee.

Food technologies now have more sweeteners from which to choose than ever before. With the obesity epidemic and the public attention it currently receives, plus the increasing interest in foods with added benefits sweeteners that allow for consumer appealing labeling are of particular interest. These sweeteners fall into basic categories, those that are essentially calories free, often referred to as low-calories or intense sweeteners, and those, which are significantly reduced in calories, which may be referred to as reduced calories-sweeteners, bulk sweeteners, or sugar replaces. These sweeteners when used alone or in combination may permit such labeling as ‘low-calories’, ‘reduced-calories’, ‘light’ ‘sugar-free’ and ‘dose not promote tooth decay’.

The ideal sweeteners does not exist, it would be at least as sweet as sucrose and provide the same properties to a product as sucrose, with processing parameters similar to those of sucrose so that existing equipment can be used. It would be colourless, odourless and noncariogenic, with a clean, pleasant taste and have immediate onset and not much lingering. Solubility and stability are important. The ideal sweetener must be compatible with a wide range of food ingredients because sweetness is but one element of a complex food flavour system. Even sucrose is not perfect, being unsuitable for some applications.

Probiosis has emerged in the early 20^th century after Ellie Metchnikoff proposed his hypothesis that organisms were reponsible for longivity of ethnic people of Balkan region of Russia and ever since it has grow into a major scientific field which has its applications extending into farming, aquaculture and prophylactics in humans. Vast research was carried out on this topic and Lactobacillus sp. and Bifidobacterium sp, are the two important genus that are highly studied and widely recognized universally as conventional probiotics. Apart from these two genus there exists many other bacterial species which have shown promising probiotic potential. Such non conventional probiotics are widely used in some parts of world as commercial food products with health beneficial effects, pharmaceutical products or being tested for their safe utilization in human beings. The present chapter tries to covers some genera and their potential and application in prophylactics.

Fresh fruits & vegetables and their value added products are increasing in popularity day by day almost in all the countries, because of their richness in dietary fibre, minerals & vitamin contents and for their medicinal properties. Maintaining agricultural produce quality and its evaluation are thus naturally important. Decisions concerning maturity and ripeness of fruits and vegetables are based mostly on visual inspections, which are subjective in nature. The quality of fruits and vegetables is mostly decided on the basis of size, shape, colour, gloss, flavour, firmness, texture, taste and freedom from external as well as internal defects. Internal quality factors such as maturity, sugar content, acidity, oil content and internal defects, however, are difficult to evaluate non-destructively. Methods are needed to better predict the internal quality of fruits and vegetables without their destruction. Recently, there has been an increasing interest in non-destructive methods of quality evaluation, and a considerable amount of effort is being made in this direction. But the real problem is how these methods are to be exploited practically on commercial scales and what are the constraints faced in implementing them.

The decisions concerning harvesting, maturity, ripeness and quality are based mostly on subjective and visual inspection of the external appearance of the fruits. The quality of fruits and vegetable is mostly based on size, shape, colour, gloss, flavour, firmness, texture, taste and freedom from external and internal defect. Many techniques for evaluating the external quality parameters are now available commercially. Internal quality parameters such as sugar content, acidity, oil content and internal defects however, are difficult to evaluate. Methods are needed to predict the internal quality of fruits and vegetable better without destroying them. Recently, there have been an increasing interest in non-destructive method of quality evaluation and a considerable amount of efforts has been made in this direction. The development of science and technology, especially of information technology has made available many non-destructive methods of analysis of materials which can also be applied to fruits and vegetables. The fruit industry needs non-destructive techniques for online sorting and certifying high quality fruit.

Non-destructive method can be classified according to the principle used to detect fruit properties; mechanical, acoustic, optical and Nuclear Magnetic Resonance (MRI) Techniques.

INTRODUCTION

Food processing as a technological regime is undergoing a revolutionary change in terms of conception, product and process design and energetics. The conventional approach of a food processor is to develop products with a long shelf-life in user friendly packaging systems. Food processors are usually bothered about sensory attributes and microbiological profiles without much emphasis on the fate of heat labile nutritional and nutraceutical components. The changing consumer perception is slowly but steadily leading towards emergence of novel technologies without depending upon conventional thermal processing. A few years before, non-thermal techniques have emerged for food processing and preservation, but these techniques were restricted to framing of fundamentals with regard to the inactivation of vegetative and reproductive bodies of microbes and the deteriorative enzymes.

Non-thermal preservation technologies inhibit microorganisms and enzymes without relying primarily on high temperatures. They are designed to preserve freshness, colour, flavour, texture and heat-sensitive nutrients more effectively than conventional thermal treatments. These methods employ hydrostatic pressure, electrical energy, electromagnetic radiation, reactive species or mechanical forces to damage microbial cells and disrupt essential biological functions. The chapter examines high-pressure processing, pulsed electric fields, cold plasma, ultrasound, irradiation, pulsed light and edible coatings. It explains their operating principles, mechanisms, applications and nutritional implications. These technologies offer promising alternatives for producing safe, minimally processed foods, although equipment costs, process optimisation and industrial scalability remain important considerations.

Introduction

For the year 2016-17, as per the FAO global estimate, the food grain production has crossed over 2.6 trillion metric tons, while the steadily increasing the demand is anticipated to be approximately 3.3 trillion metric tons for 2016-17. Similarly,the global production of all horticultural commodities has crossed over 1.8 trillion metric tons. The global trade of these commodities is purely based on their quality, the demand for good quality produces increases day by day. The term “quality” is a broad terminology used to explain many parameters and differs from commodity to commodity. Usually, the term ‘quality’ is classified into internal and external quality. The external quality refers the external colour, size, shape appearance, uniformity, external damage, cracks and bruishness etc. These parameters may be common for both perishables and durables.

But, in case of internal quality, each and every parameter vary from commodity to commodity, product to product. For food grains, the internal quality refers to moisture content and other nutritional parameters like carbohydrate, protein content etc. But in fruits, the internal quality refers to internal pulp colour, TSS, pH, acidity, juice content, ripeness, other biochemical and nutritional quality parameters. 

Milk fermentation is process by which a change is produced in milk through the activity of microorganism. As milk leaves the udder it serves as a medium for the growth of many species and accordingly undergoes a series of changes, the processes producing these changes constitute the milk fermentation.

Fermentation of organic compounds, especially in the lack of oxygen leads to the rapid break-down of ‘biopolymers’ to produce ‘anaerobic food chains’.

With the increasing health consciousness of consumers, there has been an increasing concern over the use of thermal processing methods like blanching, pasteurization, sterilization etc. for enhancing the shelf life of foods as these methods fail to preserve the fresh like nutritional, therapeutical and sensory qualities of the food. With the increased consumer demand for fresh and fresh-like foods, interest in minimal processing of foods is increasing. The trend is also shifting from the traditional heat processing to those technologies that employ no or minimum heat application, thereby retaining the quality to a maximum level. One of the ways to accomplish this is via use of non-thermal processes. Over the past few years a number of non-thermal processes or cold preservation methods have been invented and developed. These methods are being evaluated in pasteurization and sterilization of various foods or in the extension of shelf life of various packaged foods. Some of such novel technologies and the products prepared, have been discussed here under.

1. Extrusion

Extrusion is a size enlargement process wherein small granular food or powdered particles are re-formed into larger pieces with different shapes, textures, colours and flavours from the basic ingredients. In extrusion food is compressed and forced to pass through a fine opening (die). As soon as it comes out of the opening, the outside pressure is very less as compared to the pressure inside the screw of extruder and the food expands instantaneously. If the food is heated the process is called as extrusion cooking. It is a process which combines several unit operations including cooking, mixing, kneading, shearing, compressing, shaping and forming. Extrusion adds a variety to the products by changing shape, size, texture and even some of the minor ingredients of the food and at a reduced cost than most of the other processing methods. Extrusion cooking (not extrusion) is a high temperature short time (HTST) process that reduces microbial contamination and inactivates enzymes.

Abstract

Sedentary lifestyle coupled with excess calorie intake is partially responsible for increased incidence of lifestyle related diseases like coronary heart disease, obesity, diabetes, cancer and hypertension. Non-nutritive sweeteners can offer consumers a way to enjoy the sweet taste with little or no energy. Further, functional beverages are the drinks which are altered in such a way to provide specific health benefits and disease preventing properties beyond general nutrition. In the present paper, authors have summarized various research works on development of different low calorie functional fruit and vegetable products by replacing sugar with non-nutritive sweeteners like saccharin, cyclamate, sorbitol and stevioside at different levels of sweetness (equivalent used to sucrose). The cyclamate sweetened spiced plum squash at 50 per cent sweetness proportion gave higher taste scores in comparison to saccharin sweetened beverage. In case of sorbitol sweetened beverages, with the increase in the proportion of sorbitol sweetness, the organoleptic score for colour, body and flavour increased compared to saccharin and cyclamate sweetened products. Whereas, the stevia sweetened beverages indicated highest sensory acceptability at 75% stevioside sweetness level. Further, sorbitol sweetened health products were found to have similar calculated energy value as that of sucrose sweetened products (100%), but sorbitol is absorbed slowly and does not raise the insulin levels. The development efforts had successfully reduced calorie value of plum squash up to 42% with cyclamate at 50% sweetness level. The calorie value of the sorbitol and stevioside sweetened products has been reduced by 70% and 60% per serving at 100% and 75% sweetness level, respectively. The developed products were found to have strong antimicrobial activity against E. coli as well as high antioxidant potential. Overall, it was concluded that, the developed products had better taste, palatability and storage stability beside reduced energy value, hence their availability in the market will definitely benefit the at risk group i.e. diabetics, obese and health conscious people.

Introduction

The nucleic acids are the molecular depots that are responsible for continuity of life by transfer of hereditary information from one generation to next. The sequence of nitrogenous bases containing programmed instruction determines the structure of every cell constituent and eventually every protein. In 1869, Friedrich Miescher, Swiss chemist, isolated an unknown phosphate-rich substance from pus cells named as nuclein, which was quite different from other organic substances like carbohydrate, protein, and fat. Altmann in 1899 ascertained that the nuclein also had some acidic characteristics and changed its name to ‘nucleic acid’. Later, nucleic acid was also isolated from salmon sperm nuclei as DNA-protaminecomplex. In 1953, James D.Watson and Francis H.C. Crick constructed the model of three-dimensional double helix structure of the DNA molecule which could successfully explain DNA replication.

Nucleic acids are polymeric macromolecules, or large biological molecules, essential for all known forms of life. Nucleic acids, which include DNA (deoxyribonucleic acid) and RNA (ribonucleic acid), are made from monomers known as nucleotides. Each nucleotide has three components: a 5-carbon sugar, a phosphate group, and a nitrogenous base. If the sugar is deoxiribose, the polymer is DNA. If the sugar is ribose, the polymer is RNA. Together with proteins, nucleic acids are the most important biological macromolecules; each is found in abundance in all living things, where they function in encoding, transmitting and expressing genetic information—in other words, information is conveyed through the nucleic acid sequence, or the order of nucleotides within a DNA or RNA molecule. Strings of nucleotides strung together in a specific sequence are the mechanism for storing and transmitting hereditary, or genetic, information via protein synthesis.

The term nucleic acid is the overall name for DNA and RNA, members of a family of biopolymers, and is synonymous with polynucleotide. Nucleic acids were named for their initial discovery within the nucleus, and for the presence of phosphate groups (related to phosphoric acid). Although first discovered within the nucleus of eukaryotic cells, nucleic acids are now known to be found in all life forms as well as some nonliving entities, including within bacteria, archaea, mitochondria, chloroplasts, viruses and viroids. All living cells contain both DNA and RNA (except some cells such as mature red blood cells), while viruses contain either DNA or RNA, but usually not both. The basic component of biological nucleic acids is the nucleotide, each of which contains a pentose sugar (ribose or deoxyribose), a phosphate group, and a nucleobase. Nucleic acids are also generated within the laboratory, through the use of enzymes (DNA and RNA polymerases) and by solid-phase chemical synthesis. The chemical methods also enable the generation of altered nucleic acids that are not found in nature, for example peptide nucleic acids.

5.1 INTRODUCTION

The importance of the best quality planting material as an initial investment is a well-realized factor for persons engaged in horticulture field. So, nurseries have great demand for the production of plants, bulbs, rhizomes, suckers and grafts. But in general, good quality and assured planting material at reasonable price is not available many a times. Nursery is the basic need of horticulture. Plant propagation techniques and practices is the core of horticulture nurseries. The planting materials for horticultural plantations are raised from seeds and vegetative parts. The difficulty of procuring tree seeds and their rising cost makes it necessary to find means to increase seedling survival and growth.

Raising a nursery needs a great skill. Nursery business has become an agro- business for the unemployed youths. Generally, various commercial crop growers require a good quality saplings or grafts of genuine type. So, nursery raising is quite a remunerative enterprise.

Nursery is a special place where seeds are sown, plants are propagated, grown, nurtured to usable size for planting or for sale. Nurseries provide the necessary control of moisture, light, soil and predators and allow production of healthy and hardy seedlings.

Introduction

The health and wellness of human being is largely dictated by the consumption of nutritious foods. Understanding the role of foods in maintaining health and cure of diseases has its roots in the ancient Hippocratic and Vedic texts as well as in the canons of Traditional Chinese Medicine (Sharma et al., 2012). Presently, the transition from a traditional to modern lifestyle, consumption of diets rich in fat and calories combined with a high level of mental stress has been the major cause of lifestyle related diseases like coronary heart disease, obesity, diabetes, cancer and hypertension (Moczara et al., 2012; Sharma et al., 2018). Various studies have linked foods as helpful in combating a number of such degenerative diseases (Sharma, 2015).Therefore, the tenet "Let food be thy medicine and medicine be thy food", quoted by Hippocrates about 2,500 years ago is receiving overwhelming interest. There are number of scientific reports emphasizing the importance of consuming biologically active ingredients present in fruits, vegetables, whole grains and legumes to reduce the risk of chronic diseases (Hasler 2002; Das et al., 2011; Sharma and Sharma 2016). Such biologically active ingredients are now popularly known as neutraceuticals. Whereas, the functional foods are the foods that resemble traditional foods but possess demonstrated physiological benefits. In some countries, however, functional foods and nutraceuticals are used interchangeably. Regardless, the main focus of such products is to improve health and reduce disease risk through prevention. The main difference of this category with pharmaceuticals is that they are multi-targeted mixtures and present at low concentration while pharmaceuticals are uni-targeted pure compounds with high dose use. Hence, an overview on the concept of nutraceutical and functional foods, their classification, development and regulations is summarized in this article.

Abstract

Quinoa is a pseudo-cereal which belongs to family Chenopodiaceae. Quinoa can act as highly potential crop for areas where ecological conditions do not support other food crops because of its rusticity, tolerance to frost, salinity, drought and ability to grow in marginal soils. Recently, much attention is focused on quinoa for people with celiac disease and allergic to gluten. Quinoa contains high-quality protein, complete with all essential amino acids and is a good source of carbohydrates, lipids, vitamin C, vitamin E (natural antioxidants) and adequate amount of important micronutrients such as minerals. Carbohydrates of quinoa possess excellentfreeze-thaw stability and can be used as thickener in frozen foods.

Quinoa also consists of bioactive components such as phytosterols, squalene, fagopyritols and polyphenols which act as powerful anti-oxidants in-vitro and thus couldprevent degenerative diseases such as coronary heart disease, atherosclerosis and Alzheimer's disease. Fibre accounts for 6% of the grains total weight, and quinoa intake therefore promotes intestinal transit, regulates cholesterol, stimulates the development of beneficial bacterial flora and helps prevent colon cancer. The quinoa grain can be used to combat liver disease, angina and cystitis. The radical scavenging ability and Angiotensin I converting enzyme (ACE) inhibition activity of quinoa is higher than that of amaranth, rice and wheat. Recent studies have identified significant amounts of ecdysteroids, kaempferol, quercetin, two phytoestrogen - daidzein and cenistema in quinoa. Ethanolic extract of quinoa was observed to have Antioxidant and antihypertensive activity.

Abstract

The aim is to review the potential health benefits of minor millet. There is in need to identify newer sources of nutraceuticals and other natural and nutritional materials with the desirable functional characteristics. They are an important staple food in India for people of low income groups. Minor millet is rich in several nutrients as well as non-nutrients such as phenols. Nutritionally, its importance is well recognised because of its high content of calcium (0.38%), dietary fiber (18%) and phenolic compounds (0.3-3%). Minor millets, one of the cereals are known for several health benefits including its polyphenol and dietary fiber contents. Health beneficial effects include anti-diabetic, anti-tumerogenic, atherosclerogenic effects, antioxidant and antimicrobial properties. The energy of minor millets is greater than other cereals and nearly equal to that of brown rice because the lipid content is generally higher (3 to 6%). This review deals with the nature of polyphenols and dietary fiber of minor millets and their role with respect to the health benefits associated with millet.

The three basic need for human survival are- food, clothing and shelter. The requirement of food comes first. Human are omnivorous. They eat mainly natural foods. Before 5000 years ago, cereals were the main food for all civilization and then the complexity of life began to make appearing with the advent of industrialization, flourishing of industry and commerce. Unpolished grains were utilised at first, but in contemporary civilisation, we have begun to prepare them, which results in the loss of essential nutrients. The intake of meats, processed meals, and sugary goods has grown while the general intake of cereals has decreased. People now lack vital nutrients as a result of the departure from natural diets. People began to realise a few years ago that health is a significant concern in addition to flavour, convenience, and quality value. They have thus begun taking nutritional vitamin supplements to make up for the nutrients lost from processed meals. People are increasingly opting for natural nutraceuticals in capsules and tablets, a trend known as medicalization in nutrition, instead of relying on natural food items. Hippocrates emphasized the connection between food and medicine, stating that healthy foods has a strong therapeutic advantages. The ancient Indian medical system known as Ayurveda places a strong focus on the functioning of diet and nutraceuticals in both health and illness.
9.2. What are Nutraceuticals
Stephen De Felice, the founder and chief executive of the Foundation for Innovation in Medicine (FIM), first used the term “nutraceuticals” in 1989 to refer to the broad category of medicines and nutrition. Nutraceuticals are foods or dietary components that not only offer nourishment and energy but also significantly contribute to regulating and preserving the regular physiological processes that keep people healthy. Nutraceuticals included processed meals such as cereal-grains, soups or stews, genetically engineered foodstuffs, herbal items, nutritional supplements, and extracted nutrients. People are increasingly concerned about their healthy wellbeing these days. However, these include a hectic, sedentary lifestyle, unhealthy eating patterns, body image issues, and being afflicted by a number of illnesses. These are the factors driving the global nutraceutical market’s expansion and generating a lot of interest. Numerous health issues of the century, including cancer, type 2 diabetes, heart disease, inflammation, oxidative stress, constipation, and more, can be fought off with the use of these nutraceuticals. Overall, nutraceuticals bring an entirely novel phase in medical science and assist the food companies to promote more creative research strategies. (Dudeja and Gupta, 2017)).

In this era of genomics, proteomics and metabolomics the challenge in nutritional science is to clarify human nutrient requirements and design nutritional strategies to promote health and functional longevity. Our ancient Indian belief that ‘we are what we ate’ and our future health as individuals may well depend upon what we eat today. Plant-based dietary antioxidants are believed to have an important role in the maintenance of human health because our endogenous antioxidants provide insufficient protection against the constant and unavoidable challenge of reactive oxygen species (ROS). We have various endogenous defense chemicals but they are inadequate to prevent oxidative damage that makes human system prone to various degenerative diseases. Hence, it is necessary for increased intake of dietary nutraceuticals that may help maintain the balance between oxidants and antioxidants, slow age-related changes, and prevent onset of degenerative diseases.

Abstract
The cultivation of grain legumes is expanding globally because of their diverse applications as food for humans, feed for livestock, and raw materials for industrial purposes. Legumes contribute significantly to sustainable agricultural practices due to their unique ability to fix atmospheric nitrogen through symbiosis with rhizobia bacteria in their root nodules. Incorporating legumes into cropping systems in place of traditional cereal-cereal rotations can significantly enhance agricultural sustainability due to their multiple benefits. Their role in nutrient cycling, particularly nitrogen and phosphorus, ensures that subsequent crops benefit from improved soil nutrient availability, making legumes an essential component of crop rotations and intercropping systems. Additionally, legumes improve soil structure, organic matter content, and decrease the environmental impact associated with excessive fertilizer use, such as greenhouse gas emissions and water pollution. With the increasing demand for plant-based foods and the economic challenges of fertilizing cereal crops, grain legumes are anticipated to play a more prominent role in cropping systems, especially in regions where fertilizer availability and affordability are limited. It includes studies on improving nitrogen fixation efficiency, enhancing phosphorus uptake, and developing varieties that are better adapted to specific environmental conditions and cropping systems. Additionally, there is a need to identify the most suitable legume species and varieties for different regions and cropping patterns to ensure maximum productivity and sustainability.

The foods we eat contain nutrients. Nutrients are substances required by the body to perform its basic functions. Nutrients must be obtained from diet, since the human body does not synthesize them. Nutrients are used to produce energy, detect and respond to environmental surroundings, move, excrete wastes, respire (breathe), grow, and reproduce. There are six classes of nutrients required for the body to function and maintain overall health. These are carbohydrates, lipids, proteins, water, vitamins, and minerals. Foods also contain non-nutrients that may be harmful (such as cholesterol, dyes, and preservatives) or beneficial (such as antioxidants). Nutrients that are needed in large amounts are called macro-nutrients. There are three classes of macro-nutrients: carbohydrates, lipids, and proteins. These can be metabolically processed into cellular energy. Micro-nutrients are nutrients required by the body in lesser amounts, but are still essential for carrying out bodily functions. Micro-nutrients include all the essential minerals and vitamins. There are sixteen essential minerals and thirteen vitamins.

Pineapple is considered as one of the important tropical fruits which are extremely demanded in the international market. This is due to its various quality characteristics like sweeter taste, blemish-free flesh, a cylinder shape with golden yellow pulp, a very pleasant aroma when ripe, low acidity, and a longer shelf life compared to other varieties (Banful et al., 2011; Malezieux et al., 2003). Pineapple can grow well in low as well as high fertile soil but the best production is obtained with high fertile soils. Souza et al. (2007) found that a fruit’s weight is directly correlated with the plant vigour at the time of f loral differentiation with a minimum D-leaf length. Therefore, it is proved by Souza et al. (2007) that nutrients play animportant role in pineapple cultivation to increase the growth and yield of the crop. It is also noted that the pineapple plants have a large nutrient uptake demand, especially for potassium, followed by nitrogen, calcium, magnesium, sulphur, and phosphorus.

The focus on pineapple production should not only aim for stable volumes but also sustainable growth while maintaining quality standards amidst a growing population. The ‘Green Revolution’ with high inputs has plateaued, emphasizing the need for a natural balance to sustain life and property. Effective plant nutrient management is crucial for environmental, economic, and social reasons. Pineapple’s nutrient requirements, high in nitrogen (N), potassium (K), and iron (Fe), with lower needs for phosphorus (P) and calcium (Ca), make soil organic matter desirable. Repeated cultivation exhausts soil nutrient reserves, leading to decreased yields. Heavy synthetic fertilizer use may cause soil impaction and acidification. Combining organic manure with chemical fertilizers is recommended for profitable and sustainable crop production while preserving soil fertility. However, excessive nitrogen application poses health risks. As farmers transition to organic farming, the negative impact of inorganic fertilizers on pineapple size, yield, and quality is evident.

Concept of Nutritional Genomics
After completion of human genome sequencing, the unique term “Nutritional genomics” tends to replace the old term “Nutrient-gene interaction”. It has been stated that so many polymorphism can influence protein structure and function. There are several regulatory sites where nutrients can impact the flow of genetic information. The two components of the nutritional genomics field are nutrigenomics, which studies how dietary components interact with the genome to regulate changes in proteins and other metabolism, and nutrigenetics, which determines how dietary components affect genetic variations. (Farhud et al., 2010). Nutrients are as environmental influences can interact with genetic material. It is commonly known that DNA metabolism and repair require a range of dietary elements that serve as cofactors or substrates in metabolic pathways. However, little is known about how cofactors and/or micronutrient excess or deficiency affect the accuracy of DNA replication and repair (Caroline and Fenech, 2008). The response to a particular nutrient, which is determined by the individual genotype, must also be taken into consideration, even though the nutrients can influence the development of a particular phenotypic.

The dairy farmers mostly keep cows (indigenous and crossbred) along with few buffaloes for milk production. Nutrition is the study of how food and nutrients affect the body’s health and well-being. It encompasses all aspects of food, from the food production, processing, consumption and digestion by the body. A balanced diet included all the essential nutrients such as carbohydrates, protein, fat, vitamins and minerals for maintaining good health. The recommended daily intake of nutrients varies depending on the age, gender and physical activity of a person. Nutrition labels are mainly intended to guide the consumer in food selection. Nutrition information provided on labels must be true and should not mislead consumers. Nutrition labelling regulations are provided by countries to help manufacturers. The Codex guidelines on Nutrition Labelling provide guidance to member countries to develop or update their national regulations and to encourage harmonization of national standards with international standards. According to it, no food should be described or presented in false, misleading or deceptive way. Nutrition labelling cannot solve nutrition problems, instead it is one of the elements of nutrition policy.

Nutrition Facts means the nutritional information required for most of the packaged food in many countries giving the energy value and nutrients contained in the food. Nutrition facts labels are required by regulation similar to other types of food labels. It provides detailed information on the nutrient content of the food such as the amount of fat, sugar, sodium and dietary fiber.

    1.    Nutrients : Chemical substances obtained from food and used in the body to provide energy, structural materials, and regulating agents to support growth, maintenance, and repair of the body’s tissues. Nutrients may also reduce the risks of some diseases.
    2.    Carbohydrate, fat, and protein are sometimes called macronutrients because the body requires them in relatively large amounts (many grams daily). In contrast, vitamins and minerals are micronutrients, required only in small amounts (milligrams or micrograms daily).
    3.    The international unit for measuring food energy is the joule, a measure of work energy. To convert kcalories to kilojoules, multiply by 4.2; to convert kilojoules to kcalories, multiply by 0.24.

1. Introduction Millets are the Nutri-cereals belonging to the Poaceae family and are classified into two major categories: major and minor, depending on their size and nutritional composition. Most millet crops are indigenous to India and are referred to as “nutri-cereals” since they contain most of the nutrients needed for the body to function properly. Millets such as Sorghum (Jowar), Pearl Millet (Bajra), and Finger Millet (Ragi) are the millets that come under the category of major millets. Plants have long history of their uses as ingredients of human nutrition and folk medicine,because of availability of huge array of high-value components and multiple-activity bio-actives. “Licorice” means “sweet root” in Greek is a plant of ancient origin, indigenous to Southern Europe and Asia Minor. Most of the supply comes from former USSR, Spain, Turkey, Syria, Iraq and Afghanistan, with total production between 40,000 and 50,000 tonnes per annum. The chemical constituents of the roots include several bioactive compounds, such as glycyrrhizin (~16%), different sugars (up to 18%) ,flavonoids, saponoids,sterols, starches, amino acids, gums and essential oils. A large number of clinical and experimental studies reported its useful biological properties such as antioxidant, immunomodulatory, cardioprotective, anti-inflammatory, anti-viral and anticancer effects. In the recent past there has been a great deal of questioning regarding role of milk fat in cholesterol metabolism and other body functions. The enormous wave against cholesterol containing foods has damaged the image and market growth of fat rich dairy products. This trend is due to presence of saturated fats and cholesterol that are known to increase the incidence of coronary heart diseases one of the common cause of heart attack. Nutritional value of food stuff is defined by its ability to provide nutrients required by the body. Proteins, carbohydrates, fats, minerals and vitamins are main ingredients in food stuffs. Wheat is an important source of these nutrients. The distribution of nutrients within wheat kernel is typical of many cereals. Nutrients are generally found in the highest concentrations in the germ or embryo and in the aleurone cells surrounding the starchy endosperm followed by bran, whole wheat flour and white flour in decreasing order. Of special importance is that it contains the entire B complex, except for vitamin B12. B vitamins function as cofactors in many metabolic reactions involved in the release of energy. The germ, which includes the scutellum, is especially rich in vitamins B and E, high quality protein, unsaturated fats, minerals, and carbohydrates. The bran consists mostly of the insoluble carbohydrate cellulose, and contains incomplete protein, traces of B vitamins, and minerals including zinc and iron. The endosperm is the largest part of the grain, and consists mostly of the carbohydrate starch, incomplete protein, and trace amounts of vitamins and minerals. Significant variations in the content of grains occur because of variety, crop year, area, fertilizer, and soil type.

Nutritional requirement of the major nutrients

Nutrients are the substances which are found in food and drive biological activity. They are essential for the human body.
