1. Introduction

1.1 Malnutrition

The term malnutrition generally refers both to under nutrition and over nutrition, but in this guide we use the term to refer solely to a deficiency of nutrition. Many factors can cause malnutrition, most of which relate to poor diet or severe and repeated infections, particularly in underprivileged populations. Inadequate diet and disease, in turn, are closely linked to the general standard of living, the environmental conditions, and whether a population is able to meet its basic needs such as food, housing and health care. Malnutrition is thus a health outcome as well as a risk factor for disease and exacerbated malnutrition, and it can increase the risk both of morbidity and mortality (Ogunrinade, 2014). A term used to refer to any condition in which the body does not receive enough nutrients for proper function. A person cannot properly digest or absorb nutrients from the food they consume, as may occur with certain medical conditions (Medicine, 2015). Malnutrition may range from mild to severe and life-threatening. It can be a result of starvation, in which a person has an inadequate intake of calories, or it may be related to a deficiency of one particular nutrient (for example, vitamin C deficiency).

Malnutrition is estimated to contribute to more than one third of all child deaths, although it is rarely listed as the direct cause. Lack of access to highly nutritious foods, especially in the present context of rising food prices, is a common cause of malnutrition. Poor feeding practices, such as inadequate breast feeding, offering the wrong foods, and not ensuring that the child gets enough nutritious food, contributes to malnutrition (WHO, 2015).

Pooled estimates report the prevalence of malnutrition among community-dwelling older adults of 6% and among hospitalized older adults of 39%. In developed countries, treatment of malnutrition is relatively inexpensive and effective: energy and protein supplementation using commercial “sip feeds” results in both weight gain and reduced mortality (Pereira et al., 2015). In 2013, one in four children under age five worldwide had stunted growth. Between 2000 and 2013, stunting prevalence globally declined from 33 to 25 %, and the number of children affected fell from 199 million to 161 million. Potato in India was introduced as a long day temperate crop which found suitable climate in the higher hills of the country. Since then it is grown widely in the Indo-Gangetic Plains, the Plateau and the Himalayan regions in north and the Nilgiris hills in south of India. The Central Potato Research Institute (CPRI), Shimla has developed 49 potato varieties by the conventional breeding for suitable cultivation of potato in different potato zones of India. A number of technologies for ware- and quality seed- potato production, storage and processing have been developed/standardized for adoption by the end users. These technologies have contributed immensely towards multiple increase in area, production and productivity of potato during last sixty years. Apart from conventional tools, modern biotechnological tools like whole genome sequencing technology, transgenics technology, molecular markers, RNAi and microarray technology have are also being employed in potato improvement.

Advancements on sugar processing

India has popped out as one of the largest sugar processing country throughout the world. Through the collaboration of research and development carried out in the field of sugar processing, this industry has witnessed the vast changes in term of technology. Important considerations such as productivity improvement and cost reduction were the main objectives in the field of sugar processing. Sulphur dioxide was earlier used but afterwards lime treatment in clarified juice helped in the processing of white sugar from sugar cane. Since then the continuous progress and improvement has been made and advanced techniques are introduced for manufacturing of sugar with modern tools.

Ramjeawon (2004) reported that farmers and agriculture workers grow sugar cane and beet root for sugar production,providing about 20 kg per capita and that is equivalent to almost 13 percent energy requirement. Fechter et al. (2001) reported that production of the white sugar was focused more on juices rather than molasses which were taken as the raw material. Various processes such as ultra-filtration, de-mineralization and de-colorization were used for the production of white sugar. The traditional refining process wascheaper, and effective in terms of purification and juice purification was the method used for the processing of white sugar directly from the sugar cane. Crystallization was one of the process which is used for increasing the recovery of sucrose and it reduces the molasses production. Chromatography was used in the sugar industry for the separation of sucrose. Another method was ion exchange demineralization which was used in the sugar industry for the removal of minerals from the liquid sugar. Later adsorption has been incorporated to be used de-odorization and de-pigmentation. Membrane filtration is latest technique used in the process which was used for maintaining the quality of white sugar by removing unwanted particle from the juice. Velásquez et al.,(2018) reported that thermal processes are also used for the production of sugar from sugar cane. Non centrifugal cane sugar processing is used for this purpose and the product is obtained by evaporating the sugarcane which has the unique flavor and aroma. Later the product is used as the sweetener and has a traditional characteristics flavor and optimum nutrition.

1. INTRODUCTION

Preservation of foods by drying is perhaps the oldest method known to mankind. Drying is a thermo-physical action and its principles are governed by heat and mass transfer laws inside and outside the product. The weight of the product is reduced to the extent of 1/4^th to 1/9^th of its original fresh weight. Drying of foods and biological products is a widely applied process for different purposes such as increasing the shelf-life, reducing packaging costs, lowering shipping wastes, encapsulating flavours, making food available during off-season, adding value by changing the phase structure of the native material and maintaining nutritional value. Drying or dehydration of fruits and vegetables can be accomplished with low capital while maintaining high quality and obtaining less perishable food products.

Abstract

Packaging plays an important role in the food processing Industry. It makes food more convenient as well as gives the food greater safety assurance from microorganisms, biological and chemical changes such that the packed foods can have longer shelf life. In order to meet the huge demand of processed food with longer shelf life, various methods of preservation and packaging are being used in the food processing industry. Drying and dehydration is one of the method which helps preservation of a perishable commodity against deterioration or spoilage.

The pineapple, botanically known as Ananas comosus Merr, is the most famous edible member of the Bromeliaceae family. It is native to southern Brazil and is known by a variety of names, including “pina” in Spanish, “abacaxi” in Portuguese, “ananas” in Dutch and French, “nanas” in Southern Asia and the East Indies, “po-lo-mah” in China, “sweet pine” in Jamaica, and merely “pine” in Guatemala (Morton, 1987). After banana and mango, the pineapple is the third most important tropical fruit of the world (Chen et al., 2019; Nath et al., 2019). The pineapple became a major cultural icon of luxury after its introduction to Europe in 17th century. Pineapple has been grown commercially in greenhouses and on many tropical plantations since the 1820s. Furthermore, it is the world’s third-largest tropical fruit producer. Hawaii was a major pineapple producer in the twentieth century, with Costa Rica, Brazil, and the Philippines accounting for nearly a third of global pineapple production. Pineapples grow as a small shrub, with the un-pollinated plant’s individual f lowers fusing to form multiple fruits. The plant is usually propagated from a side shoot or an offset produced at the top of the fruit and it matures in about a year.

Crop Improvement

Pineapple is usually propagated through asexual method by using slips, crowns or suckers. Sexual reproduction in pineapple is barely used due to its self-sterile nature and failure in formation of seeds. Seed set can occur in case of self-fertilization but the seedlings are with low vigour due to inbreeding depression (Robert et al., 2003). Pineapple is heterozygous in nature, on this wise hybridization is possible in this crop. Gametophytic self incompatibility is reported in this crop where pollen tube growth is repressed in the uppermost part of the style. Diploid chromosome number of the crop is 2n=50. The genome size of the crop is estimated to be 526Mb and total genes were anticipated to be around 25,862 in number (Zhang et al., 2014).

Abstract

Food lost during the production chain is referred to as postharvest loss. Reducing postharvest loss can effectively feed starving mouths while conserving resources and decreasing the pressure to produce more. There are five main areas where postharvest loss can be reduced – harvest, storage, transportation, processing, and retail. New approaches and technologies in each of these areas will increase the amount of food available for human consumption. The total loss due to poor post- harvest processing of agricultural products in India when valued in terms of monetary reflects a tremendous loss in the economy. Annual value of harvest and post-harvest losses of major agricultural produces at national level to be of the order of Rs. 92,651 Crore calculated using production data of 2012-13 at 2014 wholesale prices. Deficits in food items or financial loss should not have occurred if postharvest losses were reduced through proper processing and preservation from harvest to consumption. Both the government and private sector need to invest in research so as to improve and modernize post-harvest facilities for attaining more efficient market infrastructure and distribution channels. Research and extension activities have to be closely coordinated particularly in the public sector for the benefit of farmers, traders and consumers.

A number of innovations have taken place towards ready to eat instant food mixes of traditional origin. These have helped people to eat traditional food in which ever part of the world they go.

MTR Foods Pvt. Ltd. is a subsidiary of Norwegian conglomerate Orkla and is an acronym of Mavalli Tiffin Rooms. According to the company, India is on the verge of explosive growth in packaged instant foods. MTR has an aim to target a market of Rs 30, 000 crore with their products of traditional meals, breakfast, snacks and desserts. The Nielsen India study has shown that in 2020, the number of consumers in this category will be 2.7 times than the current base.

Mother’s Recipe is a brand which make traditional pickles in bottles with a distribution network to 20 states in India and exporting the products globally. The manufacturing is done in-house and the raw materials are procured seasonally in large quantities. After cleaning they are cut according to the recipe. Each variety of mango pickle has its own cutting process. Some are automatically cut, while others need manual work. The use of right oils, spices roasted inhouse, and marination of the pickles according to the practices of the particular region allow many consumers to relish them. Bottling and packaging are done only when the orders come.

Abstract

Medicinal herbs are economically and nutritionally important plants, which are rich in health-promoting compounds. Herbs are the backbone of both the traditional Chinese and Indian medicine, which has long history as part of their culture. Ensuring the quality of herbs is a crucial step for integrating the traditional medicine into science-based modern medicine. Drying is an essential technique in preservation of herbs as it affects directly the quality attributes of the dried products, whereas many producers lose much profit due to poor drying techniques. So, employing a suitable drying technology and selection of appropriate drying conditions are very important for producing high quality herb products. The aim of this article is to summarize the advances in drying technologies of medicinal plants, describe the current status and identify future research opportunities. The current work provides more data and information for selecting optimum technology for herb drying and would trigger innovative drying technologies to enhance drying kinetics and quality of herb drying.

Introduction

The improvement of the quality of foods can be made by fortification of foods nutrients quality and quantity in food. It can be a very cost effective public health intervention. As a result of the high consumption pattern of dairy products viz. yogurt, the fortification process will effectively diminish or prevent diseases associated with nutritional deficiencies (Gahruie et al., 2015). However, due to nutrients deficiencies in human population especially in certain stages of life, holding, importing, and consumption of fortified foods is increasing (Preedy et al., 2013). As a general rule, addition of one or more essential nutrients to a food and increasing their concentration in that particular food to levels higher than normal is known as fortification. This is intended at preventing and correcting shortages in one or more micronutrients in the society or specific population groups (Bonner et al., 1999). The major ways of food fortification are (1) commercial and industrial fortification for wheat flour, corn meal, cooking oils, (2) bio-fortification of crops to augment their nutritional value, which can include conventional as well as selective breeding, and genetic engineering and (3) house hold fortification like vitamin D drops. Fermentation has twofold outcome on glycemic index though there are conflicting results after consumption. The reduced glycemic index of fermented food has been featured to the production of short?chain organic acids during fermentation.

Introduction

For human beings, the three most important necessities for their survival are food, clothing and shelter. among all of these food is the top most priority. Food safety and Standards defines food into 8 categories (Nutraceutical, Heath Supplements/Dietary Supplements, Food for special medical Purpose, food for Special Dietary Use, Novel Food, and Functional food) in regulation, 2016. A growing trend of health products, concept of food as medicine, associated public interest and consumers demand leads to a progressive research interest in functional foods and nutraceuticals development. Abnormal lifestyle, food habits (consumption of junk food) and low physical activity creates an exponential growth in a number of chronic diseases; obesity, cardio-vascular syndromes, osteoporosis, arthritis and cancer (Das et al., 2012) among the developing and developed countries. While nutraceuticals and functional foods are becoming an alternative affordable system to reduce the risk of disease through prevention in spite of high tech therapies and costly medicines.

The current survey showed that worldwide revenue of functional foods is projected to increase from about 300 billion U.S. dollars in 2017 to over 440 billion dollars in 2022. Also according to the International Food Information Council (IFIC), health benefits achieved from functional food components may provide benefits far beyond than basic nutrition. Products like dietary supplements containing vitamins, functional foods such as sports drinks or products fortified with probiotic play a major role in the market rise (www.statista.com).Indian and Chinese traditional foods, recipes, spices and diversified ingredient market is well known around the world from centuries. Hence, a double-digit growth rate is also experienced in Asian nutraceutical and functional food market. Another reason for the growing trend in consuming functional foods is education and proper health awareness. Furthermore, people are more concern about the optimization of health-promoting capabilities in their diet using dietary supplement and fortified foods. While, food product based industries are marketing health supplements using scientific facts and the relationship between diet and health. Government, non-government organizations (NGOs) and web-based online information also play a key role in promoting and trending food based health products.

Preamble

Historically, food has been an integral part of human civilization and diet with varied food components has sustained human life on this planet over the centuries. Similarly, culturing of food with natural fermentation as means of preserving foods with extended shelf life for future use. In the background of sustaining food security, advances made in biotechnology and molecular biology has provided ample scientific platform to use the advances in increasing and expanding food production on a global magnitude, so as to meet the needs of an ever-growing world population.

The intestinal microbiota is a key component of both the metabolism and immunity of humans and animals. The desirable microbes do have a significant role to play in healthcare through control of digestive disorders and foodborne illnesses. The continued research in this area over the years has led to the identification of important molecules that regulate major functional attributes in the betterment of human health and wellness in the long run. The science and technique of genetic engineering through molecular biology approaches has enabled in enriching the beneficial molecules for the benefit of human life. The accuracy in targeting and designing of molecules will go a long way in developing genetically modified (GM) lactic acid bacteria (LAB) and GM probiotics to significantly rewrite the medical care with food-based approach in the form of targeted specific diets – “Dietomics”.

1. INTRODUCTION

When the fruits and vegetables are ready for the intended purpose, these have to be harvested. What is meant by harvesting and how the produce is harvested, what are the harvesting methods, how these are packaged in what type of packages have been discussed in this chapter.

2. HARVESTING

Harvesting of produce at proper maturity is of paramount importance for maintaining quality during storage and marketing. When the produce is harvested immature or over-mature, it will affect the quality and storage life adversely. After the proper maturity stage has reached, the produce needs to be harvested for various markets. While harvesting, it must however, be kept in mind that all horticultural produce (with the exception of some dry fruits/nuts) is very delicate and mishandling at harvesting may lead to mechanical injury, compression injury that is irretrievable. The injury on fruits/vegetables enhances ethylene production, moisture loss and serves as an entry point for a wide range of pathogens, hence causing quick loss in quality and storability of produce. The injury caused to the produce during harvesting not only spoils the commodity but also makes it unfit for long-term storage or long-distance transportation. Proper training to the labour engaged in harvesting on what to harvest, and how to harvest and the use of proper harvesting tools can reduce considerably the postharvest losses.

Introduction

Cereals and cereal products comprise a long history of consumption by humans. Cereals are the important source of nutrients and non nutritive health beneficial components and for that reason cereal based food products are consumed as staple food in human diet in developed as well as developing countries. The cereal grains mainly cultivated and consumed as food include rice, maize, wheat, sorghum rye, barley, oats, and millet. Products obtained from cereal grains are flours, grits, semolina, breakfast cereals, extruded product like pasta, puffs and flakes, and bakery products such as bread, biscuits, cakes and tortillas. Moreover, cereals or their components are used as ingredients in the preparation of various food products such as beverages infant foods coatings and processed meats. Initially cereals are consumed as whole or with minimal processing like boiling, grinding and roasting. However, processing like salting, drying, steeping and fermentation of cereals for preparation of cereals based beverages and foods has been practiced since the initiation of cereals consumption as food by human. Increasing consumer awareness and commercialization of cereal products have created interest of food manufacturers in utilization of novel and more efficient technologies with optimized conditions, development of convenient and more health beneficial foods with satisfactory sensory properties and wide variety of foods to ease the choice of consumers. Market full of diverse range of snack foods, breakfast cereals, ready to eat and ready to cook foods, and novel functional foods with variation in appearance, texture and flavor is an indication of evolution of food industry from basic to complicated form focused on efficient and automated operations. In ancient times, fermentation of food was done with the aim of enhancement of shelf life and palatability without clearly knowing the role of microorganisms. Modern fermentation technology uses various operations and specific strains of microorganisms for conversion of bulky and perishable materials into novel foods with more pleasing flavour, enhanced functional properties and extended shelf life. In addition to basic bread, new varieties of bread developed with improved functionality like sourdough bread, gluten free breads and high fibre breads is an example of innovation in cereal fermented foods indicating modification in ingredients, microbial culture and processing technologies as compare to traditional fermentation process. The word “extrudate” is derived from the Latin word “ex” meaning ‘out’ and “trudere” meaning ‘to thrust’. Extrusion technology is turning out to be very popular in food industry due to its versatility, usefulness and cost efficiency. It is well-organized state-of-art technology and plays important role in various food industrial processes such as cooking, mixing, conveying, shearing and shaping of end products. Extrusion cooking is high temperature short time (HTST) with high pressure process, is especially used for preparation of cereal based snacks, fat replacers, breakfast cereals, infant formula, gluten free foods, starch and protein rich cereals food products. A wider range of ready to eat food products with different texture, size and shape is produced by fast and easy extrusion cooking. In epidemiological studies it is stated that whole grain consumption is more health beneficial than refined grains and the reason behind it is that dietary fibre and phytochemicals located in germ and seed coat are generally removed during milling or polishing. Various technologies are developed by food scientists and technologists to preserves the bioactive compounds during processing and or to supplement processed food products with the bioactive compounds during food preparation to maintain the bioactivity and functionality of final products. Utilisation of whole grain flours, composite flours, supplementation of cereal foods with ingredients from fruits, vegetables, plant extracts and legumes, bio-fortification of crops, implementation of genetic engineering to produce crops rich in bioactive compounds are some technologies which are being used in modern food industry to develop value added cereal food products.

Introduction
Milk reception at the processing plant is a crucial stage in the dairy supply chain, as it serves as the first point of quality control and the gateway to further processing. The success of milk processing hinges on the careful handling, evaluation, and preparation of the raw milk upon arrival. The stringent protocols at reception ensure that only high-quality raw milk enters the system. By implementing advanced technology, strict hygienic standards, and efficient handling practices, processing plants can maintain milk’s safety and quality, setting the foundation for the production of superior quality dairy products. The intricate procedures at this stage safeguard consumers' trust and ensure compliance with regulatory requirements.
Milk is transported to dairy plants either in cans or in road/rail tankers. The designated area within the dairy plant where milk is first received, inspected, and graded for acceptance is referred to as the milk reception dock, platform, or raw milk receiving dock (RMRD). This reception dock is specifically designed and equipped to ensure the efficient handling of milk, enabling its swift unloading while also accommodating the cleaning and sterilization of used containers.
Since the quality of milk is a critical factor for its subsequent processing, the decision to accept or reject milk must be made promptly upon its arrival, following a thorough evaluation. The milk reception process should be meticulously planned, and the equipment must be selected to ensure efficient intake operations, particularly in facilities handling large milk volumes. Any delay can result in deterioration of milk before unloading, increased labour requirements, and higher operating costs. To avoid such issues, milk deliveries should adhere to a strict schedule, and the reception process should be completed within a stipulated time frame of time. This ensures seamless continuity of the dairy plant operations.

14.1. Introduction

There is a tremendous need to change the way society produces, and consumes materials to manage the environmental effect in the growing scarcity of resources. To overcome this issue, recycling process could be a great possibility that reduce the uses of natural resources, maximizethe waste utilization and produce least environmental impact. Unfortunately, packaging materials contribute 40% of solid waste in Western Europe, and 33% in US. In fact, packaging waste is likely to increase in transitioning and developing countries. Recycling process consists of collection, sorting, recovery, and management of packaging materials. As per the report of “Eurostat statistics in 2018”,European Union (EU) generates 174.1 kg of packaging waste per inhabitant, Croatia contributes 67.8 kg per inhabitant and Germany produce 227.5 kg per inhabitant.

Abstract
The growing global population has intensified farming practices, increasing the use of fossil fuels and agrochemicals. With limited land and the need to enhance food production, balancing environmental impact, especially carbon footprints, is crucial. Climate-smart mitigation options, with a prime emphasis on crop diversification, can help agriculture adapt to anomalous weather patterns and build resilience. Legumes offer a sustainable solution by reducing greenhouse gas emissions, as they produce 5-7 times less gases per unit area compared to other crops. They aid in carbon sequestration, with soil carbon estimates of 7.21 g kg-1 of dry matter, and save fossil energy by decreasing nitrogen fertilizer use, reducing CO2 emissions by 277 kg ha-1 per year. Legumes play a key role in low-emission farming systems due to their ability to fix atmospheric nitrogen, reducing dependence on energy-intensive synthetic fertilizers. They improve soil health, enhance soil structure, and support carbon sequestration. Integrating legumes into crop rotations reduces the need for chemical pesticides and fertilizers. Additionally, legumes can be used in food, feed, and biofuels, lowering reliance on more carbon-intensive resources. Embracing legumes in farming systems promotes sustainability improves soil health, and considerably reduces the overall environmentalimpact of agriculture.

Abstract

Refractance Window (RW) drying is a relatively new drying technology. This method is carried out by spreading a thin film of food slurry on a conveyor belt made up of a transparent polyester material. The slurry is thermally heated as it moves along the conveyor belt, resulting in rapid drying of the product. RW drying is similar to Drum Drying, but conducted at lower temperatures (95–97^ºC) and without direct contact with the heat source. RW drying offers low operating costs with excellent retention of color, flavor and nutrients.

It is well known that lowering the temperature of food stuffs reduces microbiological and biochemical spoilage and thus extending the shelf life of the product. In addition, it is generally agreed upon that the reaction rate is reduced by half by lowering the temperature by 10°C. Though low temperature preservation process has been recognized as a preservation technique for several hundred years, the major developments in its utilization have occurred only in the last century.

1. Introduction

Refrigeration may be defined as the process of achieving and maintaining a temperature below that of the surroundings. The aim being to cool some product or space to the required temperature. Refrigerated system or a room system is maintained at a temperature which is lower than the atmospheric temperature. Due to higher temperature of atmosphere, heat enters the system. To keep the temperature of the system constant, heat must be removed continuously from the system. Heat removed must be equal to the heat transferred to the system. One of the most important applications of refrigeration has been the preservation of perishable food products by storing them at low temperatures. Refrigeration systems are also used extensively for providing thermal comfort to human beings by means of air conditioning.

Introduction

Agricultural production system achieved a miracle by the way of green revolution which compactualized the potential of photoperiod and the thermo insensitive input responsive crop culture. The productive trends of food crops continued with increased fertilizer consumption, irrigation potential and improved agro-techniques. However science based intensive agriculture with intensive irrigation due to its inappropriate, inpropotional and ambitious approaches put the agriculture productivity on back foot. Global Packaging Regulations: FDA, EU, FSSAI, and Others FDA (U.S. Food and Drug Administration): The FDA ensures that food packaging materials are safe for contact with food in the United States. Under the Food, Drug, and Cosmetic Act (FDCA), the FDA provides guidelines through the Code of Federal Regulations (CFR), Title 21. Key points include: • Food Contact Substances (FCS): Materials in contact with food must be either pre-approved or recognized as safe (GRAS). Packaging materials, including plastics, paper, and adhesives, must undergo tests to ensure they do not release harmful substances into food. • Migration Limits: The FDA sets allowable limits on the migration of substances from packaging into food, including chemicals from inks, coatings, and polymers. • Food Packaging Certification: Packaging manufacturers must confirm that their materials meet FDA standards for safety in food contact

The global market for nanotechnology in food packaging is valued at 20 billion in 2023 and is expected to grow to 46.50 billion by 2031, with a compound annual growth rate (CAGR) of 11.32% from 2024 to 2031 (InsightAce Analytic, 2023). The rapid expansion of nanotechnology has paved the way for number of industrial areas, including food processing, food contact materials, and agricultural output (Mohammadi & Jafari, 2021). Nanotechnology is the fastest-growing field of science that significantly enhances the quality of life in today's world. This rapid advancement has opened up numerous industrial sectors, such as food processing, food contact materials, and agricultural production. A natural advancement is the integration of nanotechnology into food packaging. This includes enhanced packaging, active packaging, and a new category known as smart or intelligent packaging. Food contact materials, such as antimicrobial metals and oxides, biodegradable nanocomposites, and nanosensors, are utilized to create active and intelligent packaging. These materials enhance thermal and mechanical durability, increase safety and extend the shelf life of food, and facilitate the monitoring of packaged food (Kah et al., 2013). At the nanoscale, material properties change significantly, making it challenging to predict, identify, evaluate, and manage the health, safety, and environmental risks associated with nanomaterials. For example, nanoparticles (NPs) of 50 nm can enter cells, those of 70 nm can penetrate the lungs, and 30 nm NPs can cross blood-brain barriers.

Introduction

Food packaging is one of the most dynamic and fast-growing industries in the current scenario of increasing industrialization. With the constant upsurge in the food wastage at different stages of processing (suchas harvest, storage, processing, transportation, and distribution) leads to more than 15% of food produced ending up in the dumping grounds due to food spoilage caused by climatic conditions andmicroorganisms.Ever-increasing demands of consumers for convenient food makes packaging technology a need of the hour in order to keep the food safe, wholesome and of high quality at the same time.

So appropriate packaging has the potential of not only preventing spoilage but also taking care of healthand well-being of the individuals.Therefore, packaging plays the most important role in the overall safety of the food product.This makes packaging as the ever-evolving field since new requirements need new materials which demands new approaches and technology for better quality products.

By definition, Food packaging is a well-organized system of protecting the food product from any kind of physical, chemical, and biological damage in order to ensure that food reaches the consumer in its most safe condition at minimum applicable cost. The decline in productivity of old and senile orchards existing in abundance has become a matter of serious concern for the orchardists, traders as well as scientists. In India 30-35% area under fruit crops is occupied by old, senile, and pest-and-disease- affected orchards. For overcoming the problem of unproductive and uneconomic orchards existing in abundance, large scale uprooting and replacement with new plantations will be a long term and expensive strategy. Thus, rejuvenation of old and senile orchards is a good alternative.

Recommended dietary allowance (RDA) is defined as “the nutrient present in the diet which satisfies the daily requirement of nearly all individuals in a population”.

Introduction

Food safety and quality are the prime concerns in a global food supply chain. With the globalisation and advancement in the technologies, the global agricultural system transformed to a stage where food standards and international trade work hand-in-hand to promote food safety. The key drivers for this change in food regulations include digital technologies, novel food processing technologies, product labelling, marketing trends, e-commerce, etc. International trade in food sector is governed by the agreement on the application of Sanitary and PhytoSanitary Measures (SPS) and Technical Barriers to Trade (TBT). The agreements allow member nations to impose all measures or standards to protect human, animal, plant life and health, harmonize with the international standards, environmental protection, protection of consumers against deceptive practices and prevention of unjustifiable barriers to international trade.

In general, the developing countries have negligible contribution in the international trade. There are instances where the quality attributes of the commodities do not meet the required parameters as envisaged by the international market. Various issues associated with the product rejection on the basis of food safety and health standards are a matter of concern today rather than before. Hence, United Nations FAO and WTO urged the active involvement of the developing countries in the food standard setting processes in Codex Alimentarius as well as in SPS and TBT Committees. This will ensure harmonisation of food quality standards and traceability for rapid response to food borne disease outbreaks. Governments and local authorities shall intervene in the market place in setting technical regulations; and sanitary and phytosanitary measures which in turn will encourage the food processing companies around the world to implement food safety management systems to ensure the production and distribution of safe foods.

Abstract

Three-point bend test (three point bend ring-HDP/3PB) for five types (Good day, Butter bite, Marie, Krack Jack and Salted) of commercial biscuit brands (Britannia, Supreme, Parle, Lancer, Priya Gold and Dalmia) was developed using TA-XT2, texture analyzer and probable factors affecting the results were assessed. Maximum force to break the biscuits, number of fracture before break, thickness of biscuits and percent break point penetration were found in the range of 1006.5 to 3456.5g, up to 3, 4.2 to 6.3mm and 5.54 to 22.62%. The rupture of biscuits were observed on the basis of probe penetration into the biscuits and found that maximum resistance for penetration offered by Marie whereas minimum by salted biscuits, which was respectively the hard dough and fermented dough biscuit varieties. The analysis of variance for the results revealed that there is significant difference (P£0.01) in the maximum force of break for the biscuit types and brands individually or in combination. Difference in the thickness of biscuits was also found significant among types and commercial brands. The number of fractures was not consistent among the types as well as biscuit brands before reaching the maximum force of breaking the biscuit.

Breeding of Heifers

Pineapple is a monocarpic perennial herb. Each stem flowers only once and dies after fruiting, similar to bananas, before a side shoot takes over. After the pineapple plant reaches a certain size, natural inflorescence initiation (flowering) occurs in response to decreasing day length and temperature (Bartholomew, 2003). Flowering of Smooth Cayenne pineapples grown under an 8-hour day length was encouraged by a night temperature of 20°C, whereas f lowering was delayed by temperatures of 15 and 20°C, and totally inhibited by 30°C.Flower initiation usually starts in November and lasts through the winter. Flowering in nature is highly irregular, and some plants can fail to produce fruit. Thus, growth regulators such as ethylene (25-50 ppm) and NAA (25 ppm) are used in industrial practise to force plants to bloom. The numerous radish-purple sessile flowers are spirally arranged on the axis, each with a pointed bract. To explain the emergence of developing inflorescence, this stage is also known as the red bud stage. The spike-like inflorescence contains 100 to 200 florets. The petals are white at the base and bluish-purple above the calyx at anthesis. They are ligulae form in shape, about 1.6 cm long and 5 mm wide, and are about 1.6 cm long and 5 mm wide (Collins, 1960).The outer f lower petals are very close together, allowing only small insects to reach the f lower; they have 14 to 20 locules, resulting in a capacity of 6000 to 7000 seeds per 150 floret fruit. After pollination, fruits with 2000 to 3000 seeds are not uncommon (Collins, 1960).

Research methodology gives detailed justification about the research methods and procedures carried out in the present study. The present study focuses on the women’s involvement in the dairy farming and their empowerment. Keeping in view the specific objectives of the study and various aspects relating to these objectives the methodological framework has been formulated. The sub topic under the research methodology is as follow:

3.1 Locale of the study

The present study entitled “Retrospective Multidimensional Study on Magnitude of Participation of Women in Dairy Farming in East district of Sikkim” was carried out in the villages of East district of Sikkim. Sikkim is the second smallest states in India, with an area of 7,096 sq. km in size. The meaning of Sikkim is “The valley of rice”. It lies between 27 º33' 00" N and 88 º30' 00" E. The average annual temperature of the state is 18 ºC (64 ºF) and annual rainfall is 2739 mm. The state is situated in the Eastern Himalayas and it shares its border with countries like Tibet, Nepal and Bhutan. Mt Kanchendzonga (8585m) which is the third highest peak in the world is situated at Sikkim. According to 2011 census, population of state was 610,577 with male population of 323,070 and female population of 287,507. The literacy rate in the state is 81.40 percent. The density of the state is 86 people per km2 (Census,2011). The cattle population in the state was 264,860 in number (BAHS,2019). The state has four district- East, West, North, and South (Registrar General of India, 1989).

Several fruits and vegetables are unexploited for proper utilization and product development. Due to lack of utilization, there is a lot of wastage and ultimately the great loss to the people as well as nation. Some unexploited fruits and vegetables have potential for introducing new products. Therefore unexploited fruits and vegetables have to be exploited for new product development especially from underutilized sub-tropical and tropical fruits and vegetables. Research and development should be undertaken to utilize these fruits and vegetables.

Unexploited Fruits

Unripe Green Mango: Although pickles are prepared but droped green mango fruits are not preferred for pickle preparation. They can be dried and utilized for preparation of dried slices or amchur. Amchur is used to develop flavor and taste in Ice cream. These products are used to develop flavor and taste in meal or food. It is also used to prepare chatney. But utilization of Amchur is not known to common people.

Avocado: It is found in tropical and sub-tropical climatic regions having more humidity and rainfall. In Ethiopia it is found throughout the country but not utilized properly by people. They prefer to eat ripe fruits with salt and lime juice. It is very healthy fruit for chronic disease like cardiac and diabeted diseases. This is seasonal use but no product is available for off season. Therefore researches should be carried out for different products development of Avocado products.

It is a most deteriorating biological process of the harvested fruits and vegetables that leads to the oxidative breakdown of the complex material (carbohydrates or acids) of cell into simpler molecules (CO₂ & water) with production of energy. Respiration includes glycolysis metabolism, aerobic metabolism, anaerobic metabolism, trycarboxilic acid cycle and electron transport metabolism processes.

This chapter presents the analysis, interpretation and discussion of the collected data from the study area in an effort to attain the objective of the study. The data collected were analyzed with appropriate statistical test and presented in a systematic format.

The results of the study are presented under the following subheadings:

4.1 Distribution of respondents according to different socio-economic variables

Basic information of the respondents under the study has been given according to the socio-economic characteristic of the respondents. Variables like age, education, marital status, family size, family type, milk production per day, social status, farming experience, herd size, land holding and annual income are presented in the following table 4.1

In spite of big potential of the largest livestock population in the world, meat industry in India is still in nascent stage. It is a business of those who are not trained and very much literate. The industry is primarily based on the raw material that is not reared for meat purpose but serves the secondary role after passing their viable life in primary field. The industry is also facing problem of social prejudice and meat is taboo for certain communities. But scenario is now changing and people are coming forward to organise the sector. Now the society is accepting the facts that meat is an only source of cheap and nutritious food to million of people in India and the good source of animal protein for large segment of Indian population, particularly landless, small and marginal farmers.

India ranks fifth in the world meat production with the annual meat production of about 6.3 million tones which is 2.21% percent of world meat production. In the last two decades meat industry in India has grown @ 4.5% whereas, during the last five years, this segment has been growing very fast at the rate of 27% annually. It has a good future if given proper attention by the Government and Private Entrepreneurs. In total meat production, share of cattle is 17.34%, buffalo 23.3%, sheep 4.6%, goat 9.4%, pigs 5.3%, poultry 36.6% and others 3.4%. The share of various meat types in total Indian meat production accounts buffalo meat 1.5 million tones, beef 1.28 million tones, mutton 0.24 million tones, chevon 0.53 million tones, pork 0.50 million tones, chicken meat 2.20 million tones and duck meat 0.07 million tones. To produce the above quantities, the extraction or slaughter rates in cattle are about 7.9%, buffaloes 11.1%, sheep 47.9%, goat 37.9%, pigs 88.9% and poultry 73.6%. In the world total meat production Indian cattle meat shares 13.1%, buffalo meat 55.8%, mutton 5.7% and chevon 14.9%. However, India is having world’s 15.0% (210 million) cattle, 57.0 %( 111 million) buffaloes, 7.0 %( 74 million) sheep, 17.0 %( 154 million) goat and 1.5% pigs. Overall contribution of meat sector in total output of Livestock sector was Rs 25984 crores in the year 2004-2005.

Research being a continuous process for a scientific study, previous study provides basis for the research. The review of literature is necessary for developing conceptual frame work and suitable design for the study. It assists the researcher to keep his work going in right direction. The available literature related to the present study has been reviewed under the following heading:

2.1 Differential role accomplished by women dairy farmers from different social strata

Toppo et al. (2004) examined the participation of women farmers in dairy occupation in Anand district of Gujarat and their result revealed that 18.34 percent of the farm women were mostly engaged in activities related to artificial insemination, majority of the respondent (68.34%) participated in cleaning of the shed, while 25.00 percent of the farm women practised manure preparation and 95.00 percent of the respondent were not involved in preparation of gobar gas mixture.

Badole (2006) reported that majority of the responded had low socio-economic status.

Millets are essential grains that help developing nations in Asia and Africa’s semi-arid tropics, particularly India, Nigeria, and Niger, achieve food and nutrition security.They are grown on soils that are usually too weak for any other crop to grow. They can withstand drought, minimal fertiliser treatment, and temperature swings better than other cereal crops, and their short growing season makes them exceptional. Millets are all-season crops that can be grown all year and provide several security benefits (food, feed, health, nutrition, livelihood, and the environment), making them the most cost-effective agricultural security crop. Sorghum (Great millet), Bajra (Pearl millet), small millets such as Korra (Foxtail millet), Ragi (Finger millet), Kodo millet, Proso millet, Little millet and Barnyard millet are all important millet crops grown in India.

Introduction

Food processing comprise of techniques employed to transform raw ingredients into final food product or to preserve the food product. Food processing industry as well as at domestic scale the food processing methods aim at providing processed food products for daily consumption by humans and animals. Food processing aims at increasing the shelf life, preserve, make nutritious or ready to eat foods, and getting the best quality final products. There are various techniques and methods which come under food processing such as drying, dehydration, fermentation, pickling, freezing, mixing, pumping, pasteurization, cooking and homogenization etc.

Rheological properties of foods are greatly influenced by various unit operations and processing methods or conditions such as heating and mechanical treatments. Processing of different food products such as dairy, fruit and vegetable products like jams and purees, chocolates, dough development etc. and basic make up of foods such as fats, proteins and others such as emulsifiers, hydrocolloids etc. affects the rheological properties of food product and which ultimately affects the quality of end product. Apart from processing conditions the compositional variations have a great impact on the textural or rheological properties of foods. The changes in rheological characteristics of a food product reflects the alterations in the molecular structure of the food material, this can aid in revealing the changes in product structure during different processing methods or conditions. In designing of various processes such as cooling, freezing and equipment design information about thermal properties is crucial. Moreover, in order to design storage structures for foods and refrigeration equipment the knowledge of thermal properties is important (Becker et al. 2003).

For rheological measurements various tests and techniques are available, such as steady and dynamic shear measurements. From the steady shear properties flow properties of the sample can be revealed whether the flow is Newtonian or Non Newtonian. In case of dynamic shear rheological properties information on viscoelastic characteristics can be withdrawn in terms of storage and loss modulus and depending on the predominance of each modulus the nature of sample can be predicted i.e. whether viscoelastic solid or viscoelastic fluid (Bhardwaj et al. 2019). Apart from these measurements, other rheological measurements are available for specific food materials, such as farinograph, alveo-consistograph, mixograph etc. are meant for study of rheological properties of dough. So, accordingly, depending upon the food material choice of rheological measurement can be made. To study the thermal transitions DSC (Differential scanning calorimeter) and DTA (Differential thermal analysis) are commonly employed. Dynamic measurements as a function of temperature or time are made in these techniques to detect the endothermal and exothermal changes. These techniques can be used to determine the phase transitions in various foods, for instance, crystallization and melting of water, lipids and other food components; denaturation of protein; gelatinization of starch and others (Roos 2015).

1. Introduction

Celiac disease (CD) is an immune-mediated enteropathy triggered by the ingestion of gluten in genetically susceptible individuals. Gluten is the protein component in wheat, rye and barley. In the last 10 years, cutting edge scientific developments in this disease have led to the formulation of new concepts of epidemiology, pathophysiology and clinical manifestations. At present, the only available treatment for CD is a strict gluten-free diet (GFD) (Mulder et al., 2013; Theethira and Kelly, 2014). Until recently, the geographical distribution of CD was mostly restricted to Europe and other developed countries, such as the United States, Canada and Australia. Celiac disease is not only frequent in developed countries, but it is increasingly found in areas of the developing world, such as North Africa (Malekzadeh et al., 2005), Middle East (Rostami et al., 2004) and India (Basu et al., 2014, Deora et al., 2014; Yachha and Poddar, 2007). New epidemiological studies have brought evidence that this disorder is common in many developing countries as well, showing that the ‘global village of celiac disease’ has indeed a worldwide distribution (Fasano and Catassi, 2001).

The only available treatment for celiac disease is the strict, lifelong avoidance of gluten. When gluten is removed from the diet, the small intestine will start to heal and overall health should improve (Fasano and Catassi, 2001). Traditional substitutes for gluten-containing grains have been rice, tapioca, corn, and potato. However, more nutrient-dense grains, seeds, nut flours, and legumes are being incorporated into the diet to provide an enhanced palatability, variety, and nutritional quality. These include sorghum, millet, teff, quinoa, amaranth, flax seed, and buckwheat.

Ripe

This word is derived from Saxon word ‘Ripi’, which means gather or reap. This is the condition of maximum edible quality attained by the fruit following harvest. Only fruit which becomes mature before harvest can become ripe.

Ripening

Ripening involves a series of changes occurring during early stages of senescence of fruits in which structure and composition of unripe fruit is so altered that it becomes acceptable to eat. Ripening is a complex physiological process resulting in softening, colouring, sweetening and increases in aroma compounds so that ripening fruits are ready to eat or process. The associated physiological or biochemical changes are increased rate of respiration and ethylene production, loss of chlorophyll and continued expansion of cells and conversion of complex metabolities into simple molecules.

A healthy life is ensured by having access to safe, nutritious and balanced food. World health organisation (WHO) ensures its contribution in developing food safety systems that are sustainable to reduce health risks from farm to consumer. Thus, safe food, its quality and consumer protection are the priorities of this organisation (FAO and WHO, 2021)

Introduction

Biological, physical, chemical and other hazards associated with food have been detailed in Chapter 4. This chapter would address the risks associated with these hazards as well the scientific approach is assessing them. Risk analysis is an inevitable platform for food safety assurance which measures the impact of hazards on the health of consumers. To improve public health and maintain consumer trust in the food supply and to provide a sound regulatory foundation for national and international trade in food, an efficient food safety management system is essential. Therefore, World Trade Organization (WTO) developed food regulations governing international trade in foods based on science and risk assessment. A sound knowledge of food hazards and risks they pose to consumers, along with the capacity to take appropriate interventions, deserve top priority of a responsible authority and industry.

Risk

The word ‘risk’ is used to describe a situation that involves a possibility of something undesired to happen (Rowe, 1977). In food processing, hazards are considered as risks. Hazards are often thought of as synonyms of risks, however, hazards are quite different from risks.

A food borne hazard is defined by Codex as “a biological, chemical or physical agent in or condition of food, with the potential to cause an adverse health effect”. A risk is the chance, low or high, that any hazard will actually cause harm. Some of the emerging food hazards that must be assessed and managed are listed in table 1. Assessment and management of risks posed by these hazards is the responsibility to be urgently addressed by the scientific community.

Introduction

The risk assessment is gaining importance as the scientifically-based approach for the development of food safety and quality standards. It is a logical extension of HACCP revolution. In hazard analysis, first the hazards likely to occur in foods are identified, then an assessment is made of the severity of each hazard, and an evaluation is done of its likelihood to occur. Severity and likelihood are the two factors involved in risk assessment. Second, the increase in international trade has raised new safety and quality challenges. New approaches address the risk of cross-border transmission of infectious and hazardous agents with emerging food-borne diseases and quality problems. This has led to the development of a new safety and quality regulatory framework in 1995, the Sanitary and Phytosanitary (SPS) and the Technical Barriers to Trade (TBT) Agreements of the World Trade Organization (WTO). In these two Agreements, two provisions are of importance to fish safety and quality:

• National SPS and quality requirements should reflect standards agreed on in the international standards setting bodies i.e. Codex Alimentarius for food quality and safety.

• Domestic standards can be developed based on scientific risk assessment.

Risk assessment of microbiological hazards is identified as a priority area by the Codex Alimentarius Commission (CAC). In 1999, the Codex Committee on Food Hygiene (CCFH) in the 32nd session, identified a list of 21 pathogen commodity combinations that require expert risk assessment advice. FAO and WHO jointly launched a programme with the objective to provide an expert advice on risk assessment of microbiological hazards in foods to their member countries and to the CAC. Under which, expert groups are established to examine four priority pathogens: product pairings, e.g. Listeria monocytogenes in ready-to-eat food; Salmonella in eggs and broiler chickens; Campylobacter spp. in broiler chickens; and Vibrio spp. in seafoods. Risk assessment is therefore important throughout all aspects of the seafood industry - for companies, national governments and for international regulators.

9.1 Introduction

Food quality and safety are central issues in food economics today. A number of developed countries (EU, UK, US) has imposed a number of new regulations to track food products across the supply chain which is forcing the companies to invest in new automated approaches for their implementations. These solutions facilitate better process efficiency with more productivity, quality control in production lines, lower manufacturing costs with higher profit margins, and also help to achieve improved presentation as customers request. The high labour costs in developed countries make cost-cutting inevitable to remain competitive production. The growth in products packaged for the market, the increasingly strict hygiene regulations, the need to reduce risks at work, cut costs, and control product quality are all calling for the development of technologies that enable robots to be used for these tasks. In fact, robotics has a great opportunity in this industry. But the variation in physical properties of various food products and the necessity to avoid damaging them, make it necessary to seek flexible handling solutions for a wide range of products.

The robotics industry is looking into a bright future. As per the report given by the Statistical Department of International Federation of Robotics (IFR), it was projected that between 2014 and 2016 worldwide robot sales will increase by about 6% on average per year. Ten years ago, global sales figures were hovering around 80,000. So, three key factors for the boom - factory modernization, increases in production capacity and rising demand from a number of emerging markets.

Calcium, anti-oxidants and certain enzymes are reported to play vital role in extending the shelf-life of harvested produce of many horticultural crops especially fruits. They help in maintenance of cell wall structure. Being an important constituent of cell wall, in the form of calcium pectate, it helps in maintenance of cell wall structure. Antioxidants are highly beneficial in extending the shelf-life of fruits besides maintaining the quality. Similarly, some enzymes play a key role in preserving the fruit quality and prolonging its market life. As some fruits are catergorized under ‘Low volume high value fruits’, it is essential to extend their shel-flife for reducing the post-harvest losses of fruits and also to reap better remuneration. Thus, it becomes indispensable to review the role of Ca, anti-oxidants and enzymes which are beneficial in keeping the harvested produce afresh for a relatively longer period.

Abstract

Research has demonstrated that nutrition plays a crucial role in the prevention of chronic diseases as most of them can be related to diet. Functional food enters the concept of considering food not only necessary for living but also as a source of mental and physical well-being contributing to the prevention and reduction of risk factors for several diseases or enhancing certain physiological functions. One of the most clear objectives of the study of functional foods is to identify and validate biological markers in order to understand the interaction mechanisms between the food component and a body function. Epidemiologic and laboratory data from previous studies suggests that diets rich in fruits and vegetables are associated with a reduced risk of various types of cancers. The reduction in cancer risk may be attributed to the abundance of a family of specific compounds referred to as anthocyanins, which are found in various berries. Anthocyanins are water soluble pigments responsible for the blue, purple, and red color in many plant tissues Strawberry is one of “super fruits”, since they can form a significant component of the diet and are a potential resource of functional foods and nutraceuticals due to their antioxidant capacity and nutritional quality. Strawberries contain high levels of anthocyanins and they are also well liked by consumers. Popularity of strawberries in the consumer market makes them an ideal focus for chemoprevention studies. Strawberries are a rich source of phytochemicals (anthocyanins, catechins, the flavonols quercetin and kaempferol, and ellagic acid) and an important source of essential nutrients (ascorbic acid, potassium, folic acid, carotenoids, B-vitamins). Strawberries are consistently ranked among the top food sources of polyphenols and antioxidant capacity; the preventive and therapeutic health benefits of strawberries may be attributed to the synergistic effects of these bioactives and the nutrients contained in the fruit. These bioactive photochemical contribute the major health-promoting function. Strawberries have shown a remarkably high scavenging activity toward chemically generated radicals, thus making them effective in inhibiting oxidation of human low-density lipoproteins. Antioxidant activity of strawberries could contribute to the prevention of cancer, cardiovascular and other chronic diseases. Hence strawberry can be used as a vital and indispensible functional ingredient for the development offunctional foods and nutraceuticals.

Biofilms are resistant to antibiotics even at high concentrations (Costerton et al., 1999).This could happen when the diffusion of the antibiotic within the biofilm matrix is inefficient and results in slow growth rate of biofilm cells (Davey et al., 2000), there could be the presence of persistent cells and antibiotic-resistant small-colonies (Hogan and Kolter, 2002; Kolenbrander, 2000).Studies have proved that antibiotics can inhibit biofilm formation. An antibiotic azithromycin, is known to inhibit Pseudomonas aeruginosa biofilm. Biofilm colonies become resistant at higher concentrations of the antibiotics whereas at low concentrations these can be induced (Mah and OToole, 2001). P.aeruginosa is commonly present in the lungs of patients infested with cystic fibrosis. The clinical isolates show resistance to azithromycin (MIC>64 pg/ ml).However, low doses of azithromycin have shown improvement in lung function in patients with cystic fibrosis (Borriello et al., 2004). If antibiotics are given at low concentrations (below the MIC) than it induces biofilm formation in a variety of bacterial species. Sub-MIC concentrations of tobramycin can induce biofilm formation in P. aeruginosa. The use of antibiotics in agriculture, as growth promoters have shown to expose bacteria to low levels of the drugs and has caused havoc (Smith et al., 2002). Jay et al., (1995) and Joerger et al., (2003) have written the role of bacteriocins as an alternate to antibiotics. Bacteria produce bacteriocins which are proteinaceous in nature or peptidic toxins. These inhibit the growth of similar or closely related bacterial strain(s). There are different types of bacteriocins which are classified based on the producing strain, common resistance mechanisms and mechanism of killing. Ahmad et al., (2013) have isolated antifungal compound for food preservation. Martin et al., (2018) and Batish et al., (1997) found antibacterial compounds from fungus. Mahboubi et al., (2019) studied the potential of Zataria in IBS. There are bacteriocins from gram-positive bacteria known as the colicins, the microcins and the bacteriocins from Archaea (Cascales et al., 2007). The bacteriocins from E. coli are called colicins (formerly called ‘colicines,’ meaning ‘coli killers’). These have been studied widely. Earlier called colicin V and is now known as microcin V. It is very small and is produced and secreted in a different manner than the classic colicins. Adrienne et al., (2016) have studied the colicin resistance.
