7.1. Introduction

In the modem lifestyle, people are extremely busy in their work and lack the time to cook their own foods. They mainly depend upon processed and packaged food for their nutritional intake. So it becomes essential that the packaged products should be safe, hygienic and shelf stable. To preserve the food for long duration, thermal processing is most suitable method. Aseptic packaging is a form of thermal food processing. Aseptic packaging can be defined as the filling of sterile containers with a commercially sterile product under sterile conditions and then sealing the containers so that reinfection is prevented; that is, they are hermetically sealed. 

Aseptic packaging is a specialized and advanced method used to extend the shelf life of perishable foods without the need for refrigeration. This technique involves sterilizing both the food product and the packaging material separately and then filling and sealing the product in a sterile environment. Aseptic packaging has transformed the food industry, allowing products such as dairy, juices, soups, and sauces to remain fresh and safe at room temperature for extended periods. The ability to maintain product quality, nutritional value, and safety while reducing reliance on cold storage has made aseptic packaging a preferred choice in both food manufacturing and distribution. The process of aseptic packaging is both complex and precise, as it requires thorough sterilization of every component to ensure food safety. Packaging materials, typically a combination of paper, plastic, and aluminum, are carefully selected to withstand high temperatures while providing an effective barrier against contamination. This chapter explores the principles of aseptic packaging, its significance in food preservation, and the advanced technologies and materials used to achieve and maintain sterility in packaged foods.

The inorganic residue remaining after the destruction/burning of organic matter in foodstuffs is called ash. Ash contents in food commodities roughly represent the mineral contents, however, some minerals are likely to be lost due to volatilization or some interaction between constituents during ashing. Estimation of ash content is also used as a measure to judge the quality of fruit products. The presence of high ash content or low alkalinity of the suggests the presence of adulterants in the sample. Similarly, the presence of a high amount of acid-insoluble ash indicates the presence of sand and other silicious matter in the food products.
Principle
Organic matter is burnt off at as low a temperature as possible. Heating is done in stages, first to char the product thoroughly and finally to ash it at 550ºC in a muffle furnace. The inorganic material left after burning organic matter is cooled and weighed.

Concept: It’s a natural process that modifies the cytology, physiology, biochemistry, and physical characteristics of seeds. These modifications lower viability and ultimately result in the seed’s death. A decline in the proportion of germination indicates degradation, and weak seedlings are produced by seeds that do germinate. The factors that impact the ability of seed to be stored include the seed’s quality at the time of storage, its pre-storage history (environmental factors during pre- and post-harvest stages), its moisture content or ambient relative humidity, the temperature of the storage environment, the amount of time the seed is stored, and biotic agents. Seed will inevitably get damaged when being stored (Balesevic-Tubic et al., 2005). Introduction

Potato (Solanum tuberosum L) is one of the major starchy tuber vegetable crops of the world. It is a unique crop which can supplement the food needs of the country in a substantial manner. Today, potato is the need of life or poor man’s food in many countries including India. Potato production in India has made tremendous progress only with the development of new technologies in different fields of agriculture. It has been observed that the farmers are not adopting recommended practices and consequently not realizing the potential yield of potato. To understand the problems of farmers in the adoption of complete recommended farm practices, researchers as well as extension workers should come out with some concrete findings and suggestions, which can solve these problems. It has been seen that a large number of techniques and practices do not reach the farmer’s fields and those carried to the farmers get considerably distorted or often adopted partially with the result that farmers do not get the potential yield.

Introduction

“Quality” refers to the aesthetic appearance and freshness of fish. It also involves safety aspects such as being free from harmful bacteria, parasites or chemicals. The best quality fish is the one consumed within the first few hours after postmortem. We studied in our previous chapters that in some instances, even very fresh fish in rigor mortis are unsuitable for filleting. So, slightly older fish in post-rigor are more desirable for the processors.

The assessment methods of fish quality are divided into sensory, instrumental, chemical and microbiological. Sensory method is superior and all other methods must correlate with the results of sensory evaluation. So, sensory method must be done more scientifically under controlled conditions without the effects of test environment, personal bias, etc.

4.1. Sensory Methods

Sensory evaluation is defined as the scientific discipline used to evoke, measure, analyze and interpret reactions characteristics of fish, as perceived through the senses of sight, smell, taste, touch and hearing. There are few instruments capable of measuring sensory profile viz. Instron for texture, electronic nose for odour, microscopic imaging for structure, etc.

In sensory evaluation, appearance, odour, flavour and texture of fish are evaluated by the human senses. The process involves three steps: (1) detection of a stimulus by the human sense organs, (2) evaluation and interpretation by a mental process; and (3) the response of the assessor to the stimuli. The response of stimuli varies among individuals e.g. some people cannot taste rancid flavour and some have low response to cold-storage flavour.

Agriculture is the main sector of the Odisha economy and contributes approximately 42% to the gross domestic product (GDP) and employs over 80% of the population. Despite its role, agricultural production is constrained by high climate variability where rainfall distribution is extremely uneven and this has negative implications for the livelihoods of people .Drought frequently results in crop failure, while high rainfall intensities result in low infiltration and high runoff causing enhanced soil erosion and land degradation. Land degradation in the form of soil erosion and declining land fertility is a serious challenge to agricultural productivity and economic growth (Lemenih, 2004).Studies indicate that the tribal district of Odisha have experienced high rates of soil erosion and deforestation, resulting in sediment accumulation in downstream reservoirs and rivers.

Food safety and quality assumes paramount significance in any food industry. Globalization has driven both the food and agricultural firms to adopt systems that functions in a way to interlink food standards and international trade so as to achieve superior food quality and safety. Food industries follow several regional and international food safety procedures to procure certification from the government and other agencies in order to survive in both domestic and international markets (Ryan, 2014). The essential components in the food safety include handling, preparation and storing of the food products to ensure the food quality and to avoid food-borne diseases. The unwanted substances in a food product included by an accident is known as contaminants and the unwanted substance added to the food product to reduce the cost or to improve the other properties are known as adulterants. Contaminants and adulterants may lead to pathogens and toxins that pose serious concerns over the health of the consumer (Jha, 2016). The adulterants and contaminants are classified as physical adulterants and contaminants, chemical adulterants and residues, microbiological and pathogenic contaminants and toxins.

Hazards in food can be categorized into physical, chemical and biological.

Physical Hazards: Physical hazards are foreign organic or inorganic objects or extraneous materials in the food products. Hard and sharp physical hazards are of particular concern. Examples of physical hazards are broken glass, plastics, metal pieces, wood pieces, stones etc.

1. Introduction

In recent years, consumers have been demanding convenient, healthy and safe foods which have ’fresh-like’ characteristics with a long shelf-life. These demands include important food quality such as appearance, texture, taste and nutritional content which are strongly impacted by the way it is processed. Another major concern among the consumers is food safety and quality. The shelf-life of the food products are mostly influenced due to the action of various harmful microorganisms and enzymes. The conventional food processing technologies, such as thermal treatments (pasteurisation and high temperature sterilisation), evaporation, drying, frying and baking can assure the microbiological safety and/or stability of processed food products, but affects the food quality and nutrients (heat sensitive vitamins, flavour and other bioactive compounds) (Zhang et al., 2019)

Abstract

Drying is one of the most important industrial operations for preservation of food material. Due to the major limitations posed by convective drying methods, there is always a need for novel drying techniques which are technically, economically and environmentally sustainable. Based on the principle of moisture diffusion due to vapor pressure gradient, atmospheric freeze drying (AFD) offers a promising alternative to conventional drying systems. A cold gas with low water vapor pressure is used as drying medium to sublimate moisture directly from the frozen material at atmospheric pressure conditions. As a result the product gets dried at much lower temperature unlike convective drying. Thus, products dried with AFD retain better nutrition, texture and color and the process is also considerably cost effective. Major limitation of the AFD process is longer drying time, which can however be accelerated by using heat pump drying or new ultrasound technology. This chapter focuses on mechanism, benefits, limitations and comparative study of AFD with other drying methods such as hot air drying and vacuum freeze drying. It provides an insight regarding effect of AFD on properties of food material based on various studies reported in literature.

What are Genes? Genes are linear sequences of nucleotides of DNA (deoxyribonucleic acid). Each gene consists of a specific sequence of nucleotides and is responsible for determining a particular characteristic of cell. Nucleotides consist of nitrogen –containing compounds called bases, joined to the sugar, deoxyribose and to phosphate. The nucleotide bases are the purines, adenine and guanine and the pyrimidines, thymine and cytosine.

A number of genes are joined together to form a structure called a chromosome.

DNA consists of two strands of nucleotides twisted around each other into a double helical structure. The nucleotide bases are arranged in a specific sequence in each strand. The strand has a backbone of sugar and phosphate from which the bases protrude.

Bacteriophage is the term applied to bacterial viruses. Bacteriophage having the ability to lyse certain sensitive living cells. Phages are small particles, which can only be seen in the electron microscope after the application of suitable staining techniques. All phages have a head and most have a tail. The head may be isometric or prelate with a hexagonal outline.

There are two types of phages virulent and temperate which enter a different relationship with the host, the lytic and lysogenic cycles respectively.

Dairy industry size and demand precede all other segments of food industry. Reporting milk production of 146.3 million tonnes in 2014-15, India is currently occupying first position in world scenario (NDDB, 2015). In spite of limited shelf-life, milk offers various opportunities of product diversification, processing optimisation and convenient packaging solutions. All categories of dairy products are unique and vary in market value. The operating margins in value-added dairy products are almost twice of liquid milk business due to reduced need of refrigeration and added shelf-life. The appeal and satiety it offers makes them ambrosia for consumers. Baked and fried dairy products (BFDP) are those class of dairy products in which main processing operation is either baking or frying. In addition to preservation of milk solids for longer time at room temperature, manufacture of baked and fried dairy products add value to milk and also provide considerable employment opportunity (Pal and Raju, 2007;Patil, 2011). The characteristic flavour and colour development of the product rely on this unit operation or cooking method and it cannot be replaced. The unique difference in baked and fried dairy products is that in baking dough is prepared and for frying batter is prepared which vary significantly in characteristics (Table 1). The quality of the finished product greatly depends on how the dough or batter is handled.

Formulation & method of bread making Baking is an exact science that requires precise measuring and accuracy. Accuracy is crucial in baking because most baked products are made from the same basic ingredients: flour, liquid, fat, sugar, salt etc. the difference between baked products are often the proportion of each ingredients in the formula. If the proportions are off, you will end up with a different product or an unacceptable product.

The word “baked products” refers to a vast variety of foods, such as cakes, bread, cookies, pastries, and crackers, and a variety of other items, and it might be difficult to find a common thread that connects the members of this a varied group. Barley is an important cereal crop grown all over the world and is used mainly for feed and malt purposes and little for human food. Barley is the world’s oldest grain, as evidenced by discoveries in ancient cities in the Middle East and North Africa. It has been cultivated for about 8,000 years, and today is the world’s fourth largest cereal crop. Considerable evidence is available that points to the role of barley as sustaining food source in the evolution of humans. Additionally, alcoholic beverages of various types and fermented foods prepared from barley are commonly referred to in the ancient literature. As other food crops (wheat, rice, corn and rye) became more abundant, barley was relegated to the status of “poor man’s bread”. In the United states, barley used as food is 1.5%, as animal feed 65% and in malt and alcohol production 30% (Newman and Newman, 2006). In 1991, barley used as food in European countries was even lower (0.3%) than the United States. In contrast, during the same time period food was the largest for barley in Morocco (61%), China (62%), India (73%), and Ethiopia (79%). However, current consumer interest in nutrition and human health may help restore barley’s status in the human diet. Nutritional qualities of barley have been known since ancient times. For example, Ajgaonkar 1972 described how ancient Indian physicians effectively stabilized type II diabetics some 2400 years ago. Treatment was remarkable simple and not really different from recommendations that are given to diabetic patients today, i.e., lose weight, change diet, and increase exercise.

1. Introduction Millets are the oldest crops known to mankind. They are mostly cultivated for human consumption however; some are also used as animal fodder. Barnyard millet Echinochloa frumentacea is a multi-purpose crop belonging to the kingdom plantae, order-poales, family-poaceae, subfamily-panicoideae, genus-Echinochloa & species-E. frumentacea. It was domesticated about 4,000 years ago with two main species: Echinochloa esculenta (Japanese barnyard millet) and Echinochloa frumentacea (Indian barnyard millet). The former species is mainly grown in Japan, Korea, and northeastern China, while the latter is grown in Pakistan, India, and Nepal. In India, barnyard millet is grown in the Himalayan region from the north to the Deccan plateau in the south and is popularly known as jhangora or sawan millet.

1. 1 Introduction, Origin and Taxonomy Barnyard millet (Echinochloa species) is one of the oldest domesticated small millet crops which can be grown in both warm and temperate regions of the world and it is widely cultivated in Asia. It is distributed predominantly in the Indian subcontinent, China, Japan, and Korea and also to some extent in Africa and United States. In India, this crop is mainly grown in Maharashtra, Orissa, Tamil Nadu, Madhya Pradesh, Bihar, Punjab, Gujarat and the hills of Uttarakhand (Kumar et al., 2000). It ranks fourth in terms of production amongst the small millets. Indian Barnyard millet (Echinochloa frumentacea) and Japanese Barnyard millet (Echinochloa esculenta) are the two important species of the barnyard millet. Barnyard millet is majorly grown for human consumption, though it is also grown for livestock feed and fodder (Sood et al., 2015).

1.1. IMPORTANCE OF FOOD MICROBIOLOGY

Food may be defined as substances that provide nutrients, which when eaten and absorbed by the body, maintain life and growth. Food is basically energy stored in plant and animal foods in chemical form. On consumption, the stored form gets converted to physiological energy. Food is the prime necessity of life. Man has exhibited much thought and foresight in cultivating a variety of grains, fruits, vegetables, nuts and oilseeds and in rearing birds and animals for use as food.

Of the three primary needs of an individual, food, clothing and shelter, ‘food’ occupies the most important place. The biodiversity of foods- cereals, millets, pulses, oilseeds, spices, fruits and vegetables is varied and high in India, where we have varied agro-climatic regions from Kashmir to Kanyakumari. All the fifteen major climates in the world exist in India. India is the second largest producer of food in the world. The impact of green revolution is remarkable in India with many fold increased food production in the last five decades. The full potential of Indian agriculture can not be realized unless India emerges as a major player in the World agriculture.

World population is set to go beyond nine billion by 2050 and demand for food is likely to increase further because of growing affluence and globalization. Food security is achieved when all people have physical and economic access to sufficient, safe and nutritious value added food. India is emerging as a food power in the international trade of foods. The food processing industry in India has been identified as one of thrust areas for the development of the country. It has emerged as a highly perspective sector with immense potential in food processing. The future of Indian food processing industries is bright, provided it improves its quality of products as per international standards.The quality of food processing refers to the adherence of physical, chemical, biological, nutritional and sensory parameters required to achieve the wholesomeness of a food product. Quality control has become an important aspect for food processing industry for both domestic and export markets.

Sensory evaluation is a scientific method of evaluating foods including meat products that applies principles of experimental design and statistical analysis through the use of human senses like sight, smell, taste, touch and hearing. It is also called organoleptic evaluation in which we measure, analyse and interpret reactions to those characteristics of materials as they are perceived by the human senses. These attributes can be perceived well by the human sense organs as compared to instruments available for this purpose. It is a fact that no single instrument is able to assess all the attributes of meat products. With the help of these instruments we can very well evaluate the single quality attribute of meat product i.e. shear force instrument or penetrometer is good for knowing the texture and refractometer is for colour interpretation.

17.1 INTRODUCTION

Bearing habit indicates position of f lower bud with respect to vegetative growth of the plant after cessation of juvenility. Different fruit trees have different bearing habits. The knowledge of bearing habits will be of much importance for regulating the bearing of any plant by means of pruning. Terminal bearers are not normally pruned, whereas in case of lateral bearers pruning certainly increase the bearing, as it encourages the sprouting of lateral buds. Fruit trees may bear the fruits either terminally on a long or short growth, laterally on present or past season growth or adventitiously from any point on the trunk or root. The relative position of a fruit with reference to its potential bud giving rise to f lower or inf lorescence in the shoot is known as bearing habit. Knowledge on the bearing habit is a pre-requirement before performing pruning in any fruit crop (particularly in ber, guava, grape etc.). Proper understanding of bearing habits helps a lot in manipulating time and period of f lowering and fruiting which consequently inf luence harvesting and yield of better-quality fruits.

Ber (Ziziphus maruritiana Lam.) is cultivated all over the desert part of the Indian subcontinent for its fresh fruits, which are rich in vitamin C, vitamin A and vitamin B-complex and minerals. It can be successfully cultivated even in the most marginal ecosystems of the subtropics and tropics. Ber or Indian jujube belongs to the genus Zizphus of the family Rhamnaceae and order Rhamnales. Ber is adopted to ecologically poor, drought prone areas, which encounter recurrent crop failures and thereby economic crises. It yields nutritious fruit, rich in vitamins and minerals than apple even in drought years and its cultivation is highly cost effective owing to very low input requirement. Ber cultivation also provides employment for people in different farm operations for production and sale of the produce. In India, Haryana, Punjab, Uttar Pradesh, Rajasthan, Gujarat, Madhya Pradesh, Bihar, Maharashtra, Andhra Pradesh and Tamil Nadu are major ber producing states. The area under cultivation with this fruit is 8.7 lakh ha with an annual production of 8.9 lakh tones in India (Baloda et al., 2012). About 125 varieties of ber are available in India. A few of these varieties are known for taste, size, amount of pulp and higher yields. The cultivars Umran, Kathapal and Gola are the most promising varieties of ber in North India (Azam-Ali et al., 2001).

Nutritive Value

Many people are unaware that the ber is one of the most nutritive fruit, since ber is a common fruit. It is one of the richest sources of vitamin C, next only to aonla and Guava but better than citrus fruit and apple. The fruit pulp contains 13-20% total soluble solids and 0.20-0.80% acidity at fully ripened fruit. Ripe fruit of Umran contains 117 mg ascorbic acid/100 g of pulp. Ber fruit contains β-carotene (vitamin-A) at 81 µg/100 g of fruit, 5.6% sucrose, 1.54% glucose, 2.08% fructose, 1.00% starch and 1.13% total carbohydrates. Due this, so ber is often called the “poor man’s fruit”. Table 1 represent the nutritional composition of different ber varieties.

Abstract

Ber is an important fruit of India and South Asia. Its cultivation is gaining popular in recent years. The drupaceous fruits of ber are characterized by climacteric respiration phenomena and produce high amount of ethylene at ripening. It is very high in ascorbic acid content. Maturity and ripening is still judged by colour changes, as reliable maturity indices for particular cultivars are not fully established. Short shelf life is major problem in this fruit. Protocols for postharvest handling is not standardized, however, scattered information are available for postharvest behaviour and handling. Low temperature storage is beneficial and reduces respiration rates but simultaneously chilling injury is again hindrance in commercialization. Postharvest rot is major problem in storage. Therefore, focused research is needed to standardize the storage temperature and alleviation of chilling injury.

Over the past few decades, probiotics have become the most promising and emerging field in human nutrition and health across the world including India and other developing countries. The global profit generated from the probiotic market is expected to reach approximately 12,753.4 million US$ by the end of 2026 (Probiotic market report, 2018). The factor fueling the demand for probiotics is the growing awareness among consumers about their health benefits. The association of probiotics with health benefits stretches back to a time before microbes were discovered. However, the scientific evidence of the health benefits of probiotic microorganisms on the wellbeing of the host was firstly proposed by Russian Nobel laureate Ellie Metchnikoff in 1905. He reported that consumption of fermented milk containing Lactobacillus spp. is responsible for the healthy and long life of Bulgarian people (Anukam & Reid, 2007). Afterward, several of scientific progressions were made to reach the current status where probiotics are not only the subject of food and medical research but also the source of a multi-billion dollar global industry.

The term probiotic is derived from the Greek words, which means ‘for life’. According to the Food and Agriculture Association of the United Nations (FAO) and World Health Organization (WHO), probiotics are defined as “live microorganisms which when administered in adequate amount promote the health of the host” (Joint, FAO, 2002). In 2014, International Scientific Association for Probiotics and Prebiotics (IPPA) did minor correction in the definition given by FAO-WHO and defined them as “Live microorganisms that, when administered in adequate amounts, confer a health benefit on the host”

Cocoa beans are extracted from the pod of a tree crop Theobroma cacao. It is mainly cultivated in tropical and subtropical countries. In terms of world production, Ivory Coast and Ghana contribute about 65 percent of world production. Cocoa beans are the main ingredient in chocolate. (Teye, E et al 2014). One of the earliest examples of chocolate consumption comes from the Mayans. The Maya drink was prepared with cocoa and water and often included cinnamon and black pepper. It was also known as the “Food of the Gods” and offered to Emperor Moctezuma II by the Aztecs, (Verna, R. 2013). Christopher Columbus was the first European to encounter cocoa in 1502.

Introduction

Color is an important characteristic of food. Based on the color of the food, f irst impressions are made: Is the fruit immature, ripe, or overripe? Is the toast burnt? Is the food fresh? Based on these first impressions, a judgment is made whether the food is safe to eat or not and whether it can be expected to taste good or not. Since color is closely associated with expectations, the addition of color to food is a way to fulfill these expectations. Color is added to food for one or more of the following reasons:

1. To replace color lost during processing,

2. To enhance color already present,

3. To minimize batch-to batch variations, and

4. To color otherwise uncolored food.

The production of fruit and vegetables has recently increased significantly and even surpassed the total grain production in the country due to increased awareness of consumer and positive government initiatives (Schieber et al., 2001; Sagar et al., 2018; Malenica and Bhat, 2020). But due to limited production and area, the importance of excess production during a particular season and waste management arises at highest priority level. Moreover, fruits and vegetables waste are a serious problem for environment as most of themare being disposed of as landfills or directly disposed off to water bodies such as rivers (Wadhwa and Bakshi, 2013). Fruits and vegetables are perishable in nature and rich source of nutrients and vitamins, which results in microbiological contamination (Coman et al., 2019; Bas-Bellver et al., 2020). Foods wastes are usually organic residues generated by the processing of raw agricultural materials into food and are made up of liquid (wastewater) and solids (Bas-Bellver et al., 2020). The wastewater results from the cleaning processes or in the form of excessive or polluted process water. Its dry material content is typically less than 5% by mass. It possibly also contains organic or inorganic cleaning agents or disinfectants. Solid food wastes with an organic origin have remarkably high water content (mostly about 80% by mass). They are usually characterized by a constant quality and purity due to the forgone processes. The fact that these substances are removed from the production process as undesirable ingredients makes them, wastes.

Abstract

Rice is the most produced and consumed source of stable food in J andK, and is excellent in genetic diversity. Rice production is the principal activity and a major source of income for the State. Traditional rice varieties have an enhancing potential in wide range of nutraceutical and functional foods. Besides possessing medicinal and nutritional properties, the by-products generated from these rice varieties in various post harvest operations are equally valuable. Traditional healers and local farmers have been using these traditional varieties in ayurveda and in curing of various kinds of ailments, such as cooling the body in ayurvedic treatments, improving vocal clarity, curing of boils, swellings and skin blemishes. Extracts of brown rice are also used as energy drink in individuals, patients and in treatment of chronic gastric problems, jaundice, dysenteric complaints and to increase lactation and nutrition to Childs. Sticky glutinous rice has been reported in treatment of stomach upsets, nausea, heart-burn and indigestion. Brown rice extracts have been reported in treatments of breast and stomach cancer and warts.

The Packaging Institute International describes packaging as the enclosure of items, packages or products in a wrapped pouch, box, bag, cup, can, tray, tube, bottle or other container for protection, preservation, containment, communication, performance and utility. To an engineer or a scientist, it is technical matter as it is a system designed for efficient delivery of safe food products with high quality, via each and every stage of distribution chain, from production of raw material to food manufacture, packaging, retail, wholesale, consumer, disposal and finally recycling or of resource resurgence. The extent of food packaging is literally broad as it encompasses technological activities such as graphic and machinery design, package manufacture and development, shelf life testing, distribution and marketing. Food packaging science is a discipline which applies principles from four major areas of science (materials science, food science, information science and socioeconomics) to understand the properties of packaging materials, packaging requirements of foods and the packaging system. Both material science and food science have been two major contributors for food packaging development. Material science is important to understand the mechanical strength, barrier properties, appearance and physical and chemical properties of paper, glass, metal, polymer and composite. Food science is important to understand the deterioration kinetics of foods (such as microbial growth, lipid oxidation, moisture loss or gain) governs the food shelf life. Food packaging technology is a science based solutions to address specific food packaging needs; examples are tamper evident packaging, microwavable packaging, modified atmospheric packaging, and controlled atmospheric packaging which are aimed at enhancing safety, quality and convenience for the consumer.

Metabolic Processes in Bacterial Cells

All living cells are continually undergoing processes of replication, breakdown, synthesis and repair. The overall term used to describe these processes is metabolism and refers to all the different reactions that must occur in order for a cell to grow and reproduce. The pathways of metabolism are remarkably similar in all living cells. The differences that do occur usually reflect the availability of nutrients or the need for a cell to provide for a specific function. This may be secretion, storage, structural support, energy for movement, or reproduction. Our knowledge of many of the metabolic processes that occur in human cells has been derived from research on the major pathways that also occur in microbial cells.

Catabolism is the process of breakdown of complex molecules, usually with the release of energy. Anabolism refers to the synthesis of new or replacement molecules. This is an energy-requiring process. A metabolic pathway is a series of reactions in the process of metabolism.

The energy from the sun that is trapped and used to produce glucose is released when a molecule of glucose is broken down during metabolism. This complex process is called oxidation, or respiration, and consists of a number of interrelated biochemical pathways, including those of glycolysis, fermentation and aerobic respiration. Reactions that occur in the presence of oxygen are termed aerobic; those that occur in the absence of oxygen are anaerobic. Many of these reactions require the involvement of various cofactors as well as enzymes, and result in the production of energy which is captured by the synthesis of a small molecule called adenosine triphosphate (AT). ATP is termed an ‘energy-rich storage molecule’ because breakdown of ATP releases energy for use in other reactions in the cell.

Color of food is the most sensitive part of any commodity as it is the one of the organoleptic characteristic to be noticed and one of the main ways of visually assessing a food before it is consumed. The people associate certain colors with certain flavors and the color of food can influence the perceived flavor in anything from confectionary to beverages. For this reason, food manufacturers add dyes to their products. Sometimes the aim is to simulate a color that is perceived by the consumer as natural, such as adding red coloring to glace cherries, but sometimes it is for effect, like the green ketchup that was launched by Heinz in 2000. If the flavor of a food product is inconsistent with the color, the flavor can often be perceived incorrectly, for example an orange flavored drink colored green could be perceived to taste of lime. In addition, the color of a food substance is important indicator of its freshness. While all of us are aware that food with bright or unnatural colors likely contains food coloring but only few people know that natural foods such as oranges and salmon are sometimes also dyed to mask natural variations in color. The color variation in foods throughout the seasons and the effects of processing and storage often make color addition commercially advantageous to maintain the color expected or preferred by the consumer. According to Li and Tian (2012) a pure-culture planktonic growth of bacteria is rarely found in natural environments.There is a physical interaction between the bacterial cells in biofilms (Kolenbrander, 2002; Watnick and Kolter,2000).The bacteria can organize into groups and can form well-organized communities. They also communicate for coordinated activities (Davey and O toole,2000; Watnick et al., 2000; Nadell et al., 2009). Quorum-sensing mechanisms are common in prokaryotic and single-celled eukaryotic organisms like fungi (van Bodman et al, 2008; Sordi and Muhlschlegal, 2009). For any biofilm structure to develop a high level of cell density is important (Kolenbrander et al., 2002; Kuramitsu et al., 2007 and Webb et al., 2003) and also for checking the effect of antibiotics against planktonic organisms in exponential growth phase using MIC and MBC.This can predict the antibiotic efficacy against rapidly dividing bacteria in acute infections. Biofilms play an important part in biotechnology, immunology, biofouling and biodeterioration (Fleming and Wingender, 2001; Dunne, 2002). When the pathogenic cells adhere to the surface, it has been found that the transcription of the EPS genes get stimulated (Dunne, 2002). If EPS gene expression are monitored it can provide a good understanding of biofilm phenotypes (Allison and Sutherland, 1997; Helm and Naumann, 1995; Petersen et al., 2005). EPS serves many functions. It also enables the bacteria to capture nutrients (Pontefract,1991).The formation of biofilm goes through a mechanism which is different from species to species. Even the matrix thickness can be different from 0.2 to 1.0pm depending on the species and doubling time of the cells as thickness of 10 to 30 nm has been found in some bacteria species (Sleytr,1997). The cells secrete polysaccharides, proteins, nucleic acids and glycoproteins. Adherence on solid surfaces by microorganisms is a very complicated process that depends mostly on extracellular molecule production (Czaczyk and Myszka, 2007). The biosynthesis of EPS provides an optimal environment in which genetic material between the cells can be exchanged. This is needed for cell identification and the antigenic properties are helpful in serological characterization of the cells. Among the various compounds of extracellular carbohydrates are acetate esters, pyruvtes, formates, succinates, polysaccharides and proteins (Sutherland, 2001a).

Microbial life abounds on a solid substrate. Water and some nutrients are sufficient to allow the microbial construction called biofilm. Biofilm-associated infections (BAI) can enhance chronic infections in which the bacterial pathogens can persist causing cross-contamination of the food products.

Giaouris et al. (2014) worked on the meat processing and biofilm formation by foodborne bacteria. Work on seafoods has been well worked by Mizan et al. (2015). Habimana et al. (2010) studied them in feed industry on Salmonella versus host resident flora strains. Lin et al. (2017) have studied the characteristics of some food borne pathogens. In a study by Rao et al. (2020) cold atmospheric plasma can be a solution to prevent biofilms.Ferriol-Gonzalez et al. (2020) worked out that bacteriophages can be helpful to remove biofims. According to Przekwas et al. (2020) in early stage of growth of the biofilm use of ascorbic acid can be helpful for the removal of biofilms. Apples can be protected from pathogenic bacteria by protecting them using harmless bacteria. It leads towards the development of alternative foodborne-pathogen-control strategies. Listeria monocytogenes is a big concern in the NE part of India.

Introduction

Biofortification is the development of nutrient dense staple food crops using the best conventional breeding practices and modern biotechnology, without sacrificing agronomic performance and important consumer preferred trait (Nestel et al., 2006). It provides a comparatively cost-effective, sustainable, and long- term means of delivering more micronutrients (Saltzman et al. 2014). This approach not only will lower the number of severely malnourished people who require treatment by complementary interventions but also will help them maintain improved nutritional status. Moreover, biofortification provides a feasible means of reaching malnourished rural populations who may have limited access to commercially marketed fortified foods and supplements. Micronutrient malnutrition (MNM) is the major constrain to provide nutritional security to world population of underdeveloped and developing countries. Among the 20 major risk factors of the global burden of disease estimates, Fe deficiency ranks 9th and Zn deficiency ranks 11th, while in the high mortality countries, including India, they rank 6th and 5th, respectively (WHO 2002).

Due to inadequate intakes of vitamins and minerals, half of the world's population suffers from micronutrient malnutrition. An adequate amount of wholesome as well as diverse foods are required for the proper growth and development. In addition to calories requirements, these foods should provide various nutrients. In India, ~70% of children do not get the required calories either due to lack of enough food or diverse food. This indicates that these children are also incapable of fulfilling their protein, minerals and vitamins requirements. Diets that lack diversity can be deficient in certain nutrients. Due to the micronutrient composition of the soil of a region, or because of the intrinsic insufficiency of the normal diet the staple foods of some region can lack particular nutrients. The individual plant foods are often deficient in certain nutrient components due to the varying level and composition of food nutrients in different food crops. Some crops are rich in one component but low in other. For example; legumes are usually high in protein, but deficient in essential amino acids like methionine whereas, wheat and rice are rich in carbohydrates but contain little essential amino acid such as lysine, iron, and lack provitamin A. Relying on a single food crop as major staple source of nutrients thus will not attain a nutritionally complete diet and result in malnutrition and deficiency diseases, which often occur in populations of developing countries, mainly due to poverty. Globally, over one billion people are undernourished and food security is a major issue with the world's population forecast reaching to nine billion by 2050.
