Carbohydrates (glucose) are the primary energy source for a body; when digested, glucose is the end product in human beings and simple stomach animals, but it yields volatile fatty acids in ruminants. Precise regulation of levels of blood sugars/glucose in the body is the net result of various processes like digestion, absorption, and metabolism operating under the interaction of various a) enzymes and b) hormones secreted by the different organs of the body. An abnormal secretion of any of the enzymes or hormones associated with the metabolism of carbohydrates disrupts the precise regulation of blood sugar, leading to various disorders.

I. Glycogen storage diseases (GSDs, glycogenosis, and dextrinosis)
Glucose is needed by the cells for the generation of energy and other cellular activities. If glucose happens to be in excess, it is stored as glycogen, mainly in the liver and muscles, for future needs. The stored glycogen can be converted back to glucose when the need arises. Many enzymes are related to this interconversion of glucose and glycogen. Deficiencies of one or more enzymes may lead to abnormal glycogen metabolism, leading to glycogen accumulation of normal or abnormal chemical structure in tissue, collectively called glycogen storage diseases (GSDs). Billions of chemical reactions are happening inside human body and that too with lightning speed. However, the same reactions if carried out in laboratory, they take a very long time. The reasons behind it are the biocatalysts, also known as enzymes, which are synthesized by living cells. 1. Bean Roasters

When cocoa beans were first brought to Europe, the method of roasting was quite simple, often consisting of no more than metal trays suspended by chains over a fire, an ancient Middle Eastern technique for roasting coffee. The beans would be stirred by hand with a long stick or paddle until the roast was complete. Needless to day, this was very labor intensive and inefficient. Clearly, something more efficient was needed. The next development in roasting technology was not that far distant from roasters in use today. Metal cylinders or balls that could hold up to several pounds of cocoa beans would be suspended over the embers of a fire. A rod would run through the center and act as an axis upon which the roaster would turn. A hand crank on one end would allow the cylinder or ball to be turned while the beans were roasting. The result was a much more even roast than was before possible. Aspects of this technique remain in many of today’s roasters.

Today’s consumer is very much concerned about his/her health and look for the healthy options in baked products. The trend has led to various innovative formulations for the baked products so that the health benefits may also be provided not only the calories. This chapter will discuss various advancements and trends in different types of bakery and confectionary products.

These exocellular polymers present in the surface of many lactic acid bacteria, including Lactobacilli.The adhesive properties of lactobacilli are directly linked to their surface properties which are influenced by the structure and composition of their cell wall. The cell envelope of lactobacilli, bacteria, is composed of the bilipidic plasma membrane with embedded proteins encompassed by the cell wall. The bacterial cell wall consists of a thick multilayered sacculus made of peptidoglycan (PG) with teichoic acids (wall teichoic acids (WTA) and/or lipoteichoic acids (LTA)), exopolysaccharides (EPS), proteinaceous filaments called pili, and proteins that are anchored to the cell wall through different mechanisms (Figure 1).

Abstract

Foam Mat Drying (FMD) is an economical alternative to drum, spray and freeze-drying for the production of food powders. The raw material is converted into stable foam by adding foaming agent through beating or whipping in presence or not of foam stabilizers, and dehydrated by different classical airflow and thermal means. A high-quality food powder attributes can be obtained by the proper selection of foaming method, foaming agents, foam stabilizers, time taken for foaming, suitable drying method and temperature. FMD can be used for large production of food powders because of its suitability for all types of food materials, rapid drying at lower temperature, retention of nutritive value and bioactive compounds, good reconstitution characteristics and flowability and cost-effective for producing powders.

In this chapter, basics of foam and its structure, mechanisms of foaming, types of foaming agents and stabilizers for the production of stable foam have been discussed. The influence of foaming agents, foaming properties, thickness of foam and drying temperature on the drying characteristics of mat are also studied. This chapter analyzes the application of foam drying process for different food materials, the microstructure and whole quality attributes of obtained powder, and the energy consumption and costs of FMD as well.

Importance of Food Additives

Food additives are chemicals, biochemical ingredients etc., which are added to food products for their technological benefits. These benefits may be to preserve the quality of food, to maintain and improve its appeal, to ensure its nutritional value and to provide innovations in new products with consumer appeal and satisfaction. Additives are also added to maintain uniform quality and to enhance quality parameters such as flavour, colour, texture etc. in large-scale production. They and their by-products ultimately become part of the food that is consumed and so they must be safe.

Additives may be direct additives, which are added deliberately to improve its sensory quality, nutritive value, stability, ease in processing and retention of quality during handling and retailing. There are also indirect additives, which are not added intentionally but get included into foods incidentally during handling, processing and packaging.

There are some guiding principles for the use of food additives. They should be justified for their technological effectiveness and purpose. They should be safe for use. There should be maximum adequate levels, absolutely necessary levels of usage and ADI (Acceptable Daily Intake) properly evaluated while considering its safety and permitted usage levels in foods. They should not be added with the intention of misleading consumers about quality. They should also not significantly affect adversely the nutritional quality of food products.

Food additives are substances of natural or synthetic origin, which are added to foods to serve a certain technological or sensory function. They are utilized in the preparation and processing of almost all types of food in order to give favorable attributes to the food. Later he realized that the addition of salt would preserve without cooking. Food preservation began when man first learned to safeguard food from one harvest to the next and by the salting and smoking of meat and fish. The Egyptians used colours and flavourings and the Romans used spices and colours for preservation and improving the appearance of foods. Thus, food additives have been used for centuries to enhance the variety of food products, to preserve, improve its taste and appearance, and provide a better mouth feel. Food additives afford us the convenience and enjoyment of a wide variety of appetizing, nutritious, fresh, and palatable food. Their quantities in food are small, yet their impact is great.

We are very fortunate to be born in a nation which is blessed with awesome decent variety of natural products, fruits, vegetables, cereals, pulses and so forth. The population of India expanded consistentlythat cause a genuine sustenance and shelter problem. The supply of food is not adequate to fulfill the demand of the consumers. This shortage of food is the root for adulteration of foodstuffs by the traders. Food adulteration is a procedure in which the nature of sustenance is brought down either by the addition of inferior quality material or by extraction of valuable ingredient. An adulterant is a chemical substance which should not be contained within other substances (food, beverages) for legal or other reasons. The addition of adulterants is called adulteration. Food is adulterated to increase the quantity and make more profit. The food is sucked of its nutrients and the place where the food is grown is often contaminated. For instance: milkis mixed with water. Vanaspati is utilized as an adulterant for ghee. Adulteration of food is unsafe as it may be toxic and causes serious health hazards to the consumer. To evade this issue government has passed an act which is known as preservation of Food Adulteration Act. It covers security from risks involved due to contamination of poisonous elements. Instead of government efforts the informed and aware consumers will have the capacity to dispense with this issue. Adulteration and synthetic milk in India, powdered infant formula with melamine in China and adulteration of beef in Europe are a few examples. These issues can be resolved to a great extent, through appropriate food laws and policies. A country should not only possess appropriate statutory, regulatory legislations, policies in place for the su-pply of safe and good quality food at all times, but also should assure that the same is imple-mented seriously (Attrey, 2017).

Apart from health, food safety is vital for economic growth and progress as well. In India, the food processing industry holds tremendous opportunity. It has high employment potential, can boost exports of agro-products out of the country and also provide better returns to farmers for their produce. The concept of food quality and food laws is not totally new in India because food was considered an important aspect of healthy living even in ancient India. India took an important step towards building a safe food culture a decade ago by enacting the Food Safety and Standards (FSS) Act. In one stroke, it brought about a paradigm shift in the way we look at food safety regulations in India. Food Safety and Standards Authority of India (FSSAI) are mandated under Food Safety and Standards Act 2006 to protect people from this threat. In its role of a food regulator, FSSAI can be proud that it touches the lives of each of the 1.3 billion people in the country. More than just reaching the people, the watchful eye of FSSAI is assuring them that the food they get in any form, raw or processed is safe to consume (Agarwal, 2016).

Nowadays, quality is not a matter of choice but a necessity and even a responsibility of all stake holders. In the case of food, the term, 'Quality' refers to physical, chemical, microbiological, technological, economic and aesthetic characteristics. From consumer point of view, the word, 'Quality' embraces mostly the organoleptic characteristics like body, texture and flavour than the objective properties like fat, protein, lactose and acidity as determined by science based tests.

Food is a resource of immense importance and its safety in the whole production and supply chain, is very crucial. In the last century, drastic increase in the incidence of food borne illnesses, large-scale food poisoning outbreaks and surfacing of new foodborne pathogens and hazards were widely reported. Contaminants can enter food through various pathways in the food production process, and can occur naturally or as the result of inferior or inadequate production practices. Concerns on food safety are fuelled by the industrialization of agricultural production, liberalization of trade, tourism, food consumption pattern and food preparation practices. The availability of information through the mass and social media increases the number of reported cases of inadequate food safety. International competitiveness depends more on quality and safety concerns than on prices and this creates a need for safer food production and distribution practices.

Importance of Food Storage

Food storage is both a traditional domestic skill and is important industrially. Food is stored by almost every human society and by many animals. Storing of food has several main purposes:

The word biscuit is derived from Danis biscoctus which is Latin for twice cooked bread and refers to bread rusks that were made for mariners (ships biscuits) since the Middle Ages. The dough pieces were baked and then dried out in another cooler oven. All biscuits are made with flour (usually wheat flour) and all have low moisture content and thereby have long shelf life if protected from moisture and oxygen. Cookies are made from soft wheat flour and are characterized by formula high in sugar and shortening and relatively low in water. Similar product is known as biscuit in our country. In USA the term ‘cookie’ covers any flat, crisp, baked good. Cracker is a term reserved for biscuit of low sugar and fat content, frequent bland or savoury. Crackers are usually made from developed dough whereas cookies are made from weaker flour. These foods have in common their ability to stay palatable for a long period of time. Their ease of transportation and their ready consumption without any further preparation make them high on the list of staple snacks

All bread is made by baking a dough that has two basic ingredients, flour or meal and a liquid. Bakers can use a wide variety of both components. The most common type of flour used for bread and most other baked goods is made from wheat. Wheat flour has a pleasant taste and contains a large amount of an elastic protein substance called gluten. Gluten aids in baking uniformly light bread that rises (swells) properly. Other baking flours are made from barley, rye, corn, rice, oats, soybeans, and potatoes. These flours, particularly soybean flour, may equal wheat nutritionally, but none can match wheat for creating light, even-textured bread. Hard wheat flour makes lighter bread than does soft wheat flour because it is richer in gluten. Rye and whole wheat breads are made lighter by adding white flour. The liquids used in baking include water, sweet or sour milk, yogurt, wine, and beer.

Bread is either leavened or unleavened. Leavened breads contain some substance that produces bubbles of carbon-dioxide gas. These gas bubbles inflate the dough, causing it to rise and become light and porous. Most kinds of basic breads are leavened with a fungus called yeast. Biscuits, muffins, and cakes and other pastries are leavened with either baking powder or baking soda. Unleavened bread is dry and hard. Familiar kinds of unleavened breads include water crackers, the rye crisp of Sweden, and Jewish matzoth. Whether leavened or unleavened, most breads contain other ingredients in addition to flour and a liquid. An almost limitless variety of breads can be made by adding a sweetener, shortening, cheese, eggs, meat, fruit, vegetables, seeds, or nuts. A sweetener, either sugar or syrup, is used in almost all bread for its taste or as an aid to yeast growth. Bread may also have an external sweetener in the form of a decorative glaze. The high fat content of shortening and cheese increase tenderness and flakiness in bread. Perhaps the best example is the French croissant. Eggs help leaven bread dough by adding to the bread’s lightness. They can be brushed on top of the dough before baking to create a shiny crust, as in the Jewish hallah. Some breads from many nations contain fruit, a vegetable, meat, seeds, or nuts. Examples include the fruit scone of Great Britain, the spinach paratha of India, the Southern sausage bread of the United States, the Easter sesame bread of Greece, and the almond sweet bread of Finland.

Cakes are sweet baked products characterized by high level of sugar in the formulation and hence are foods of high calorific value. Among the various ingredient used flour, sugar, shortening and egg are the essential ingredients for cake manufacture.
