Overview of the Indian Dairy Sector

India’s dairy sector occupies a unique global and domestic position due to its scale and socio-economic impact. As the world’s largest producer of milk with 230.6 million tonnes of production in 2022-23 (BAHS, 2023), India contributes approximately 23% of global milk production, surpassing countries like the United States and New Zealand (FAO, 2020). This dominance is largely attributed to Operation Flood, the revolutionary initiative launched by National Dairy Development Board (NDDB) in the 1970s, which transformed India from a milk-deficient country to the world’s largest milk producer (World Bank, 1998). Operation flood is known for its contribution in increasing milk production, supplement rural income and make available reasonable prices to the consumers. This initiative laid the foundation for the cooperative model of dairy production, epitomized by the success of organizations like Amul, which became a global model for dairy development (Candler & Kumar, 1998).

1.1. Global Dairy Scenario

Global milk production is forecast at 852 million tonnes in 2019, an increase of 1.4 per cent from 2018 (DAHD, 2019) – a smaller rate of growth, reflecting downward revisions made for India and the European Union. Much of the anticipated output expansion will originate in India, Pakistan, China, the European Union, and Brazil, partially offset by declines in some countries including Australia, Colombia, and Argentina. In India and Pakistan, herd expansions drive output growth, while in China, farm efficiency improvements underpin higher growth. The output is increasing in the European Union, although slowly as dry weather limited the supply of milk during the summer, whilst rising dairy herds and stable milk prices are supporting higher production in Brazil. By contrast, the output may decline in Australia and Colombia due to dry weather, whereas in Argentina, rising feed costs and restrained consumer demand may dampen production. Elsewhere, in the United States, higher milk yields hold up the growth momentum, whereas, in New Zealand, favourable weather corroborates a positive production outlook (DAHD,19).

Cheese, butter, whole milk powder, and skimmed milk powder are a major part of the world’s dairy trade. The demand for worldwide dairy exports is highly concentrated. With a share of 12 per cent, New Zealand is the largest exporter of dairy products, followed by Germany, Netherlands, France and the US. Germany has been the world’s major dairy importer as well with a share of 10 per cent. Other large dairy product importers are China, Netherlands, France, Italy and Belgium.

Before 1999, India was a net importer of dairy products. The successful implementation of the ‘Operation Flood’ program and trade reforms caused the direction of India’s dairy trade to change marginally. India has been a net exporter of dairy products since 2000. Statistics show that India’s export share of dairy products over world dairy exports increased marginally from 0.1 per cent in 2001 to 0.5 per cent in 2019, while its import share of dairy products over world dairy imports increased marginally from 0.018 per cent in 2001 to 0.04 per cent in 2019. The Middle East, South Asia, South East Asia, and the USA are the major markets for India’s dairy products. Conversely, India is a favorable market for the European Union, New Zealand, Australia, UAE, and US dairy products.

Homogenization is now a widely used industrial process in dairy production, essential for stabilizing milk and other liquid dairy products. Its main purpose is to prevent fat from separating out of the milk, ensuring a smooth, consistent, and uniform product. Milk is a complex emulsion comprising water, fat, proteins, carbohydrates, minerals, and vitamins. Among these constituents, fat plays a critical role in determining the texture, flavor, and overall sensory quality of milk and dairy products. In its natural state, milk fat exists in the form of globules of varying sizes, surrounded by a thin membrane that stabilizes them in the aqueous phase. These fat globules typically range in size from 2 to 10 μm and have a lower density than the surrounding water-based phase of milk. This difference in density causes the fat globules to rise and form a cream layer when milk is left undisturbed, leading to an uneven texture and separation during storage.
Homogenization is a mechanical process applied to milk to modify fat globules by forcing the milk under high pressure through a tiny orifice. This reduces the average size of the fat globules while increasing their number and surface area. Practically, this greatly minimizes the tendency of fat globules to rise and form a cream layer. The enhanced stability of homogenized milk is due to three key factors: the reduction in the average diameter of fat globules, as described by Stokes’ Law, which slows their upward movement; the uniformity in size distribution, which ensures globules rise at similar speeds, preventing clustering; and the increased density of fat globules caused by the adsorption of a protein membrane, bringing their density closer to that of the surrounding liquid. Additionally, heat pasteurization complements homogenization by breaking down the cryo-globulin complex, which otherwise promotes clustering and cream formation.
The smaller and uniformly dispersed fat globules create a smoother, creamier texture and enhance the mouthfeel. This process also contributes to the visual appeal of milk, making it appear whiter and more uniform. Homogenization is, therefore, an essential step in modern dairy processing, ensuring the stability, quality, and consistency of milk and other dairy products, while addressing the challenges posed by the inherent properties of milk fat and its lower density.

Strategic partnerships and productive outreach play a crucial role for new technologies to successfully reach the market, drive growth, and strengthen a country’s global competitiveness, Outreach programs have various benefits, ranging from technology transfer awareness, communication of stakeholders, industry, government, to academy partnership promotions. These efforts help in establishing connections, communicating opportunities, and encouraging active engagement from key stakeholders. Outreach activities can be performed under two broad categories:
1. Written communication includes all communication which can be viewed, shared, or made accessible for a set of people in a passive manner. This includes reports, newsletters, guidance, and online content which provide insights of worth for stakeholders.
2. Human outreach includes all direct communication like c face-to-face or verbal form communication it included conferences, conventions, workshops, seminars and personal communication with industry leaders.
The type of outreach creates stronger, more personal connections. An effective outreach strategy usually combines both human and written outreach efforts. By following this strategy TTOs can expand and strengthen partnerships, and make it easier for research-led innovations to get transition from lab to market more effectively. This chapter explores key outreach models, strategic networking approaches, and proven practices for building impactful partnerships in technology transfer.

8.1 Key legal statutes and regulatory foundations
Various policy measures were also undertaken by the Government of India in due course of time. The Government of India enacted four science policies after gaining independence, i.e. Scientific Policy Resolution (1958), Technology Policy Statement (1983), Science and Technology Policy (2003) and Science Technology and Innovation Policy (2013). The 1983 Technology Policy Statement possessed a simple goal of creating indigenous technology and boosting efficient absorption and adaptation of imported technologies suited to the nation’s priorities and. The Technology Policy Statement of 1983 was followed up through the establishment of the Technology Information Forecasting and Assessment Council (TIFAC), an autonomous organization entirely owned by the Government of India under the Department of Science and Technology during 1988. TIFAC also offers some funding and supports development and commercialization of technologies through the home-grown technology scheme, among its other operations. The Technology Development Board Act (1995) was also a significant policy move of the government in the same direction. Also in recent times, the Government of India also unveiled its own National IPR Policy 2016 with the motto cum slogan “Creative India, Innovative India”. In addition, the policy is aligned to a number of other schemes of the Indian Government like “Make in India”, “Atal Innovation Mission”, “Start-Up India” and “Stand-Up India”, all aimed at encouraging creativity, innovation and entrepreneurship in the nation.

13.1 Challenges in the technology transfer process
Technology transfer (TT) is more complex and involves the complex interrelationships between universities, research institutes, the private sector, the state, and society. Though TT is all about translating research findings into purposeful solutions that can support the economy and society, it is not a linear process. The challenges can be described as legal, institutional, cultural, financial, policy, and human resource. All this is accompanied by bottlenecks that inhibit or decelerate the diffusion of promising technologies.
13.1.1 Legal and intellectual property challenges
The vital component of technology transfer is the proper management of intellectual property (IP), which is often the most challenging aspect.
• Ambiguities in IP ownership: During multi-institutional or shared funder research, ownership is quite controversial. As an example, when a government lab and a university collaborate on the project, there is ambiguity as to who would have the ultimate licensing authority over the technology: the university, the lab, or the funding agency. This kind of fight hinders commercialisation and scares off industry partners.
• Lengthy patent filing and prosecution timelines: In several jurisdictions, the filings, examination, and granting of a patent may take between three and five years or more. Such delay is not compatible with the rapid cycle of invention in other fields such as ICT or biotechnology, where patent claims may become invalid before they are granted.
• High costs of IP protection: International direct patenting, like under the Patent Cooperation Treaty (PCT), is costly and involves legal services, fees, and upkeep costs. These costs are excessively high, which cannot be easily compensated by universities and startups, and where technologies are not secured or limited to local markets.

R - enamel can : The acid resistant, gold coloured enamel treated can are called R enamel cans. It is used for canning of acidic food which have soluble colouring pigments.
R factor : It is a group of genes present in some bacteria that provide a basis for resistance to antibiotics and can be transferred from cell to cell by conjugation.
R value : R value is a measure of resistance to the flow of heat through a given thickness of a material (insulation) with higher numbers indicating better insulating properties.

E numbers: Each food additive used in the food industry has been given a specific number code for their identification. These numbers are called as E numbers. These E numbers are used within the European Union. The word prefix “E” stands for Europe. They are commonly used on the food label through out the European Union. These are not used in Australia and New Zealand. The different food additives are given different E numbers depending upon the type of food additive like E100-E199 (food colours), E200-E299 (preservative), E300-E399 (antioxidants), E400-E499 (thickners, stabilizers, emulsifier), E500-E599 (pH regulator, anticaking agent), E600- E699 (flavour enhancers), E700-E799 (antibiotics), E900-E999 (miscellaneous like waxes, synthetic glazes, packaging gases, sweetners, foaming agents) and E1000-E1099 (additional chemicals).

17.1 Introduction
Butter is a fat concentrate that is produced by churning cream to create a solid bulk, which is subsequently processed. The table creamery butter is produced from the cream or coagulate of cows or buffaloes, or a combination of the two. It may contain common salt and natural colorants such as annatto or carotene, but it should be devoid of other animal lipids, wax, mineral oils, and vegetable oils and fats. The only permitted additives are common salt and natural colorants (annatto and carotene), with no preservatives permitted.. The butter must contain a minimum of 80% milk fat, no more than 1.5% curd, and no more than 3% sodium measured by weight. Diacetyl may be incorporated for flavoring purposes; however, it is prohibited from exceeding 4 ppm. Calcium hydroxide, sodium carbonate, and sodium polyphosphate are permissible additives, provided that their combined weight does not exceed 0.2% of the butter’s weight.
17.2 Classification
The market supplies a wide variety of butter varieties. This varies depending on the kind of cream used in their production as well as other factors. The varieties of butter are:
1. Pasteurized cream butter: Usually made from sweet cream that has been pasteurised. However, this kind of butter has a milder flavour than the same kind of cream that hasn’t been pasteurised.
2. Ripened cream butter: Butter is produced through adding butter culture to cream and incubating it until the desired acidity and flavour are achieved. Authentically made ripened cream butter possesses a mild
flavour commonly known as ‘real butter flavour’.
3. Unripened cream butter: Created from fresh, unripened cream.
4. Salted butter: Butter with added salt.
5. Unsalted butter: Butter without any added salt.
6. Sweet cream butter: Butter made from cream with an acidity level not exceeding 0.2%.

INTRODUCTION

Food is the basic need of human beings. It gets spoiled primarily due to microorganisms and enzymes. Energy is required for microbial growth and enzymatic reactions. At low temperature, the rate of biochemical reactions is slow resulting in prolonged storage life of food. It must have been observed long back that food could be stored for longer period without deterioration during the winter months. Since then this principle is being used to extend the storage life of foods. A sea change can be observed in development of low temperature preservation technology. It has travelled a long journey to reach this stage; however, a major break through took place in twentieth century. Low temperature technology is of two types; refrigeration and freezing. In refrigeration storage, water is in liquid phase and temperature is maintained above freezing point. In freezing technology, the food is stored below freezing point and water gets converted into ice. The former is short term preservation due to slow growth of microbes and lower enzymatic activity while the later is long time preservation due to inactivation of enzymes during blanching and inhibition of microbial activity due to unavailability of free water and much lower temperature. Low temperature preservation is widely accepted and is of commercially important in food supply chain.

HACCP : The Hazard Analysis and Critical Control Points (HACCP) is a scientific, rational and systematic approach to identify, assess and control hazards during production, processing, manufacturing and use of food. It ensures safety of the food. HACCP presents a good opportunity for the food industry for upgrading quality and bringing uniformity and consistency in their supplies to international market. or It is a systematic preventive approach to food safety that addresses physical, chemical and biological hazards as a mean of prevention rather than finished product inspection. It involves identification, evaluation and control of hazards which are significant for food safety.

Introduction
 
Developments in innovative food packaging technologies have evolved in response to the need for protection of the food product containing bioactive component from both external and internal environments and in response to consumer expectations for health claims, convenience and product safety. Consumers around the world are willing to pay extra for guaranteed product freshness delivered by the type of packaging. Many new packaging developments have focused on extending the shelf life of the product and on delivering a higher quality product to the consumer. These developments would not be possible without significant advances in the materials used in packaging and the incorporation of various types of sensors into food packaging. This chapter outlines the innovative packaing solutions in the production of functional food.

Cardiovascular disease (CVD) is still a major cause of death in Western populations and is becoming an important cause of morbidity and mortality worldwide. Thanks to advanced medical knowledge and treatments, many patients survive an initial event. Because of that, prevention of secondary CVD is a growing task for nutritionists and other health professionals. Cardiovascular risk can be reduced by lifestyle changes, one of which is diet. There is now substantial evidence from epidemiological and clinical studies that a diet rich in fruits, vegetables, unrefined grains, fish and low-fat dairy products, and low in saturated fats and sodium, can reduce the risk of coronary heart disease and hypertension.

India is emerging as a food power in the international trade of foods. The immense un-tapped potential in the food processing sector in India has to be still exploited. It has been termed as ‘sun rise industry’ for improving agricultural productivity and enhancing food availability. The terms food quality management and food safety have assumed large dimensions today. In the international trade of foods, specifications have been laid down on the levels of harmful substances (chemical or biological origin), protocols have been documented on their detection and quantification in foods. We have to meet these international standards to export processed food and earn foreign exchange. The future of Indian food processing sector is bright provided it improves the quality of its products as per international standards.

Food poisoning is an acute illness resulting from the ingestion of injurious agents such as chemical, heavy metals, parasites, microbial toxin, wild species of mushroom in food. Food poisoning is commonly caused by certain bacteria or their toxins, which are the poisonous proteins that these bacteria produce. Food borne pathogens are potential global problem, more than 90 per cent of the cases of food poisoning are caused by bacteria, Staphylococcus aureus, Salmonella spp, Clostridium perfringens, Campylobacter jejuni, Listeria monocytogenes, Vibrio parahaemolyticus, Shigella dysenteriae, Bacillus cereus and enteropathogenic E. coli. These bacteria are commonly found in many raw foods. Generally a large number of food poisoning bacteria must be present to cause illness. In most of these food poisonings, the food serves as a vehicle of transmission. The role of food here is significant, since the product not only may permit the survival of the pathogens, but also may provide a suitable medium for the rapid multiplication of microbes and production of toxin. A more serious aspect of microbial contamination is the possibility of serious health hazards due to potential pathogenic organisms gaining entry into foods due to low standards of hygiene and sanitation.

Food poisoning may be due to food intoxication or food infection. Food intoxication and food infection differ in many characteristics (Table 17.1). Food intoxication refers to food borne illness caused by the ingestion of a microbial toxin preformed in the ingested food (Botulism). The most serious food poisoning caused by toxins is botulism, an often fatal disease that results from eating improperly canned foods containing the bacteria Clostridium botulinum. Classically, food intoxication is caused by the growth of Clostridium botulinum, Staphylococcus aureus, Bacillus cereus in food. Clostridium botulinum produces a neurotoxin, while Staphylococcus aureus and Bacillus cereus cultures produce enterotoxins in food.

Size shape and Appearance of Bacterial cells

Bacteria vary significantly in their morphology, that is in their appearance. They range in size from 0.2 μm to1 μm in diameter and 1 μm to 10 μm in length. There are three basic shapes of cells :

Abstract

Tremendous changes in lifestyle, eating habits and shifting rural habitations are causing an irreversible change that is leading to manifold multiplication of health problems and these health issues have attracted the attention of every segment of the society in the recent past. Today foods are not intended to only satisfy hunger and to provide necessary nutrients for humans but also to prevent nutrition-related diseases and improve physical and mental well-being of the consumers. Due to increasing control over nutrition and health, consumers are becoming more proactive towards their health. In this regard, functional foods play an outstanding role and they are gaining public acceptance and there is great scope for value-added as well as health promoting food products in developing countries. Various terms have used for functional foods throughout the world such as designer foods, medicinal foods, nutraceuticals, therapeutic foods, superfoods, foodiceuticals, and medifoods. People are interested in foods which boost immune system, reduce the risk of diseases and improve health. The increasing demand of such foods can be explained by the increasing cost of healthcare, the steady increase in life expectancy, and the desire of older people for improved quality of their later years. Typically, a food marketed as functional contains added, technologically developed ingredients with a specific health benefit. These range of products cannot be truly classified as ‘food’ and a new hybrid term between nutrients and pharmaceuticals, ‘nutraceuticals’, has been coined to designate them. The development of functional foods involves the application of various food processing techniques such as microencapsulation of functional ingredients for controlled release, nanotechnology for the development of nanostructured (or nanotextured) food ingredients and delivery systems for nutrients and supplements etc. Inclusion of probiotic bacteria and probiotic supplements in various food systems has also become very popular and this is becoming a very vital sector in functional food market. Systematic RandD efforts are, therefore, required to develop health promoting foods for all segments of the society at affordable cost. Prior to promoting the developed health foods, it is of utmost importance to conduct clinical trials to ascertain safety and efficacy, and also establish appropriate regulatory framework for their distribution to masses. All these issues have been discussed in this paper and recommendations were drawn to formulate future research.

Abstract

Microencapsulation has found great applications in food business. However, the technology remains aloof from being fully exploited. Microcapsules offer food processors a way to shield sensitive food ingredients, mask or preserve flavours and aromas and conversion of volatile food components into easy-handled solid ingredients (like powders, capsules etc). A number of naturally occurring and synthetic polymeric materials have been identified so far that possess the entrapping property and are categorised as GRAS materials. Numerous techniques have been developed for using these entrapping materials to encapsulate the sensitive food ingredients. Controlled release of the food ingredients at proper place and right time could be therefore a key practicality that may be provided by microencapsulation. With strictly fine-tuned and stabilized release characteristic, this method adds worth to the merchandise. The areas of interest in this field include the development of alternative and inexpensive polymers that may be considered natural or mimic the properties of natural polymeric materials, like Gum Arabic, Gellan Gum, Gum Karaya, Gaur Gum and Gum Acacia. Limitations in many of the encapsulation techniques have occurred due to high value of raw materials and production. This review is effectively committed to the, properties of encapsulating agents along with the emphasis on different techniques used for encapsulation in the varied fields like food technology, pharmaceutical, commercial engineering and biotechnology.

The dairy processing industry in India deals mainly with the fluid milk and/or short shelf life products, despite India being the largest producer of milk in the world, with an output bordering the 110 million ton mark. This feature offers immense potential in the area of R&D in dairy processing in terms of value addition. The potential gains are many, including higher returns for producers and advantages in terms of health, therapeutic, nutritional and/or gastronomy for the consumers. However, the Indian Dairy Industry can amass possible benefits by being a global contender in trade only when its products are at par with those available in the rest of the world in terms of price and quality. It is evident from the post-WTO scenario that for sustainability, Indian dairy industry will need to maintain wholehearted commitment to quality management right from the farm to the consumer, shedding its inhibitions and resistance to changes.

9.1. WTO Agreements and Food Industry

The General Agreement on Tariffs and Trade (GATT) was formed in 1947 and lasted until 1994, when it was replaced by the World Trade Organization (WTO) in 1995. The WTO is the only global international organization dealing with the rules of trade between nations. It provides a forum for negotiating agreements aimed at reducing obstacles to international trade and ensuring fair deal for all, thus contributing to economic growth and development. Currently, there are 16 agreements to which all WTO members are parties and two agreements to which only some WTO members are parties. WTO currently has 153 members, of which 117 are developing countries or separate customs territories. The Head Quarters of WTO is at Geneva (Switzerland) and the official languages are English, French and Spanish.

Abstract

Meat is considered to be a highly perishable food commodity because of its biological composition. Thus, to extend its shelf life and maintain its nutritive value, there is an urgent need to find out alternatives for synthetic anti-microbial and anti-oxidants. This will not only serve the purpose of meat product manufacturer’s but will also satisfy the consumers’ demand for minimally processed meat products devoid of synthetic preservatives. This review discusses the natural antimicrobial and anti- oxidants sources viz., various essential oils, their composition and application in different meat and meat products. Essential oils from basil, rosemary, thyme, oregano, ginger, basilica, balm, coriander, rosemary and clove have exhibited a better potential to be used as an antimicrobial agent in meat and meat products. They owe their anti-microbial properties to the phenolic compounds present in them. They dislocate cell membrane and disrupt functionality of bacterial cell membrane and eventually leading to the release of intracellular components. However, essential oils are not widely used due to the pungent and intense aroma imparted to the food, thus there is still need to work out on the novel technologies which can not only increase food shelf life but at the same time, are sensorially acceptable to the consumers.

Abstract

Ghee means the pure clarified fat derived solely from milk or curd or from desi (cooking) butter or from cream to which no coloring matter or preservative has been added. It is the second largest dairy product prepared from milk and it is almost 35% of total milk production. Unfortunately, the producers or the middle- men involved in the ghee trade, tend to adulterate ghee with cheaper oils and fats like vegetable oils, animal body fats, hydrogenated fats and sometimes even the non-edible mineral oils, especially during lean season to earn more money. Recently, the problem of adulteration has assumed a very serious dimension. Such a situation has tarnished the image of dairy industry. Methods presently adopted by food law enforcing agencies to ensure the quality of ghee are mainly based on the physico- chemical constants, but all these methods have some limitations. So researchers are always in search of different innovative methods to check the quality of ghee.

Introduction

Over centuries, spices have been used as an important addendum for colour, flavour and preservation of foods. In addition, their medicinal and cosmetic utilities have been widely recognized (Purseglove et al., 1981; Srinivasan, 2005). All these benefits made them extremely desirable with an ever growing demand in the international market. India holds the title of the largest producer and exporter of spices with major share for pepper, capsicum, turmeric, ginger cardamom, seed spices, curry powders, spice oils and oleoresins. The other primary producers of spices includes China, Indonesia, Malaysia, Egypt, Turkey Brazil and Mexico while USA, Europe, Japan, East Asian and Middle East countries are their major importers.

Spices are made from diverse plant parts viz. rhizomes, barks, leaves, fruits and seeds and hence its processing methods vary depending on the raw material. However, the basic unit operations namely harvest, pre-treatment, drying, cleaning, particle size reduction, packaging and microbial decontamination in sequence remains common for the production of most of the spices. Inappropriate conduct of basic unit operations often lead to high microbial load, aflatoxin contamination, losses of valuable compounds, change in sensory characteristics, physical damages and incorporation of contaminants in spice products (Table 1). Moreover, spices being natural products, they may be fraught with a large number of microorganisms including several pathogenic species of bacteria and fungus depending on the prevailing conditions in their cultivation areas. In addition, poor food sanitation awareness and practices in spice producing countries may worsen their microbiological safety. Although spices are nonperishable in nature due to their low moisture contents after drying, they may act as a source of microbial populations upon contact with moist food products with no further thermal treatment. The outbreak of ‘salmonellosis’ in Germany (1993) due to contaminated paprika and paprika-powdered potato chips is an example. The aforesaid disadvantages related to conventional spice production may confound their international trade unless desired objectives of food safety management schemes such as International Commission on Microbiological Specifications for Foods (ICMSF) are met. Moreover, international agencies have set standard to guarantee safe spices and augment business interests of their adherents. For example, both the European Spice Association (ESA, 2015) and American Spice Trade Association have set a maximum level of 1% w/w extraneous matter in spices (ASTA, 2017). These challenges associated with the conventional production system may be effectively addressed by preventive risk management strategy by which suitable control measures are enforced at earlier phases of food chain prior to consumption. The control measures must guarantee that the level of contamination has not exceeded the maximum permissible limit at every phase of spice production from farm to table.

Introduction

Commonly available food materials especially dairy products, cereals and fruits are perishable and require processing for long term storage. The methods of food storage has been known from the pre historic times and was mostly based on processing the food into a more stable form with a longer shelf life. Such processes increases the time range of food availability and in many cases improves the taste thereby, cumulatively improving the food value. One of documented method of food preservation is by fermentation and is age old. Other commonly used methods include drying, refrigeration, salting and fermentation (Luck 1985, Paulus, 1985, Christensen et al., 2003, Martindale and Schiebel, 2017).

Flavour and appeal of food has been considered as one of the important factors contributing to the demand of the food. Originally the flavours were largely plant derived, current industrial practices largely utilise synthesis by chemical reactions and subsequent extraction to achieve a uniform quality (Weckerle et al., 2006, Davidovich-Rikanati et al., 2008, Sethupathy et al., 2018). These chemicals referred to as “flavourings” are defined as compounds that enhance the taste, appeal and palatability of food. They are naturally derived or artificially synthesised compounds. Considering that many artificially synthesised chemical flavours might affect the health adversely. Industrial food research has now shifted their focus on flavourings that are naturally available (Cohen et al., 2018). Such naturally occurring flavourings are referred to as bio-flavours (de Billerbeck 2015). The ease of producing bio active compounds from microbial culture extracts has played significant role in industrial food biotechnology (Verachtert et al., 2005).

Wine is a very unique fermented beverage. It was an essential part of various religious and cultural ceremonies in ancient civilizations; and continues to be considered as a ‘drink for elite’. The reason is that wine was considered as ‘Gift of God and ‘God’s nectar’ in religious text books, and medicinal value of the beverage is well supported by modern science. Wine is a beverage well tagged with its geographical origin. This concept originally comes from French concept of terroir; which explains that a varietal wine from a defined region possess distinctive qualities. Wine makers of the past enjoyed this definition of quality for better marketing opportunities. Today, globalization and advancement in wine science created empowered consumers who could clearly discriminate quality of wines. In addition to a product with high sensory qualities, consumers expect a healthful beverage produced in an environmentally sustainable manner. Enology research projects focus on such aspects; and this chapter is a glance on enology advancements and proven health benefits of wine, such as cardiovascular health gut health, dental health etc.

Introduction

Functional elements are non-conventional biomolecules in foods that have the ability to modulate one or more body metabolic processes or pathways, leading in health advantages and well-being promotion. Research has demonstrated a connection between food, health and well-being functional elements. Consequently, functional elements have health-promoting roles connected with multiple progressive steps at various phases of disease control, from initiation to growth. They can therefore be implemented efficiently in disease therapy and prevention. Therefore, the borderline between food and medicine is becoming very thin at a moment when the role of a healthy diet in stopping non-communicable diseases is well recognized. Functional elements include plant-derived, non-nutritious and biologically active chemicals that operate in the body to avoid certain non-communicable diseases from occurring.

Food contains over 900 phytochemicals. One fruit or vegetable serving (about 120g) can contain as many as 100 distinct phytochemicals. Previously, functional elements were believed to happen predominantly only as phytochemicals in plant products including whole grains, fruits and vegetables. However, in animal goods such as milk, fermented dairy products and cold water fish, probiotics, conjugated linolenic acid, long-chain omega-3, −6 and −9 polyunsaturated fatty acids and bioactive peptides are also discovered. Usually, functional elements happen in various forms in food such as glycosylated, esterified, thiolated or hydroxylated materials. They also have numerous metabolic operations that enable positive impacts in the body on several illnesses and target tissues (Balic et al. 2020).

Introduction

The art of fermentation process is developed as far back as thousand years ago without understanding the role of microorganism in it. It is believed that the process of fermentation originates in Indus valley during 7000 – 8000 BC. Archives of harappan civilization showed that different clay utensils were used for the fermented product and the agriculture and animal husbandry were fully developed during that period. It is evident from the artifacts of Egypt and middle east that the practice of fermentation was common in that part (Farnworth, 2003). The earliest practice of cheese making is originated from Falcate between Tigris and the Euphrates rivers in Iraq, 8000 years back. Later, Egyptians developed the use of yeast in wine and bread making during 4000 BC (Ross et al., 2002). Further, Sumarians prepared beer from fermented barley during 1750 BC. Earlier the fermenting process was an artisan way without any knowledge of microorganism. However, the main turning point was in 1608, when Antony Van Leeuwenhoek first established the use of a microscope and revealed the existence of microorganisms. Another, major finding was Pasteurization by Louis Pasteur in 1861 AD and this was the first report that documented the role of microorganism in fermentation. Later, there was a shift observed in the production of fermented food from local communities to large scale industry. The health effect of fermented food was first reported by Roman historian Pliny, who reported that fermented milk is beneficial for gastrointestinal complains. Further, a French paediatrician proved that Bifidobacteria in food prevents infants against infection (Grill et al., 1995).

Abstract

Enzyme is a highly efficient catalyst that is produced by active cells. When compared to chemical catalysts; enzymes have a number of benefits, including high specificity, high catalytic efficiency and flexible activity, all of which greatly help to promote their use in the pharmaceutical, chemical, and food sectors. The majority of enzymes such as protease, amylase, lipase and cellulase are relatively unstable and industrial uses are frequently restricted by a lack of long-term operational stability as well as the technically challenging recovery process and ruse of the enzyme. Enzyme immobilization provides an excellent base for increasing enzyme availability to the substrate with higher turnover over a long period of time. Enzyme immobilization are done by several methods and their performance are influenced by many factors. Physical and chemical based immobilization are the most commonly used methods. The matrix immobilizes the enzyme by holding it permanently or temporarily for a short stretch of time. The generally used matrixes for immobilizations includes natural, synthetic polymers and inorganic compounds.Currently, synergistic interactions of biotechnology and nanotechnology are useful for the development of immobilized enzymes. Enzyme immobilization is a commonly used technology in a variety of industries including food, pharmaceuticals, bioremediation, detergents, and textiles due to technical and economical advantages. This chapter focuses on most commonly used immobilized techniques in industry with many recent applications of immobilized enzymes.

1. Introduction

Energy balance means keeping an account of how the flow of energy is taking place in and out of any system or process. It helps the engineers to estimate the total energy requirement and identify the area for conservation of energy in any process. In food processing the concept of energy balance is applicable in unit operation such as blanching, drying, evaporation, freezing, refrigeration, distillation, crystallization. The scopes of energy balance in food industry are:

i) Streamlining and reduction of energy consumption in the existing process.

ii) Selection and sizing of any equipment and process.

iii) Economic analysis of alternate process/technology.

iv) Designing new economically viable process/technology

Tea as a Beverage

Tea is the most popular beverage consumed in the world after water. All types of teas including black. green, oolong, white and pu-erh tea are mainly made from the buds and young leaves of tea plants, Camellia sinensis (L.) O. Kuntze belongs to the family Theaceae [1]. Depending on the different processing techniques of tea leaves, tea types are categorized as “Green Tea” (unfermented), “Black Tea” (fully fermented), “Oolong Tea” (partially fermented), “Pu-ErhTea” (post fermented) and white tea (unfermented) [2]. The manufacturing process for these different types of teas mainly differ in the degree of enzymatic oxidation (fermentation) process [1].

HACCP: The Hazard Analysis and Critical Control Points (HACCP) is a scientific, rational and systematic approach to identify, assess and control hazards during production, processing, manufacturing and use of food. It ensures safety of the food. HACCP presents a good opportunity for the food industry for upgrading quality and bringing uniformity and consistency in their supplies to international market. or It is a systematic preventive approach to food safety that addresses physical, chemical and biological hazards as a mean of prevention rather than finished product inspection. It involves identification, evaluation and control of hazards which are significant for food safety.

HACCP plan: A document prepared in accordance with the principles of HACCP to ensure control of hazards which are significant for food safety throughout the food chain under consideration.

Haemagglutinins: A group of proteins of plants that are not antibodies and do not originate in an immune system but bind specifically to carbohydrate containing receptors on cell surfaces (red blood cells). It is also known as Phytoagglutins / lectins.

Tissue culture refers to the technique of growing cells, tissues, or organs under controlled, artificial conditions. This allows propagation of tissues from a small sample of cells/tissues under sterile conditions. Plant tissue culture is widely used for various purposes, including the production of disease-free plants, rapid multiplication of plants with desirable traits, genetic modification, conservation of rare or endangered species, etc. Tissue culture is a valuable technique because it enables consistent and large-scale production of plants, ensures genetic uniformity, and allows manipulation of plant biology at cellular level. In this chapter, we will discuss about the major types of tissue culture techniques and their advantages, disadvantages, as well as applications in brief.

Different Types of Tissue Culture

Callus culture involves induction and growing of unorganized, undifferentiated cell masses from an explant on a nutrient/culture medium. The part of plant used to induce callus is called explant which can be tissue, organ or part of a plant.

Organ culture is used to maintain or grow an entire organ or a part of organ in vitro. It preserves the structure and function of the organ for studies or transplantation.

Embryo culture involves isolating and growing embryos from seeds or ovules in a nutrient medium. It is used to bypass seed dormancy or rescue embryos from hybrid crosses that may not develop naturally.

Cell suspension culture involves growing dispersed cells or small cell clusters in a liquid medium under continuous shaking. This is used for large-scale production of cells, secondary metabolites, and studying cell biology..

From earlier chapters, it is evident that Lactobacilli and Bifidobacteria are the two important genera that have potent applications in food microbiology and human nutrition due to their role in food and feed production, preservation and also due to probiotic potentialities. Most of the bacterial species are still unknown indicating that the identification and classification of bacteria is a hard task since the beginning of microbiology and consequently our knowledge about bacterial ecology is very low. Mean while the expectations about novel bacterial products are high. Therefore, bacterial identification has become a growing field of interest in microbiology. Since, Lactobacilli and Bifidobacteria genera include a large number of species and strains exhibiting important properties in an applied context, chiefly in the area of probiotics as food and therapeutics, an updated list of species belonging to these two genera, their phylogenetic relationships and other relevant taxonomic information are of great significance. The classification and identification of a probiotic isolate at strain level point out its typical habitat and origin. Moreover, the species, or genus name, may also indicates the strain’s safety and technical applicability for its use in probiotic products. Taxonomy helps to place a newly identified organism in a relevant group and enables the scientific communication. Further it facilitates the construction of databases that can be used for rapid identification of organisms at laboratory level easily. Thus, taxonomy of Lactobacilli and Bifidobacteria helps to study these organisms scientifically and allows characterizing and arranging them in an orderly manner which promote the scientific community to explore the benefits from those organisms for the betterment of mankind.

Introduction

Preceding chapters discuss the essentials of probiotics, their role in maintaining gut health in combination with prebiotics and significance of systematic classification of probiotic isolates. Further, to draw an idea how probiotics function in the gut, it is essential to know the interaction of probiotics with other microorganisms in the gastrointestinal milieu - the site of their probiotic action. Knowledge in the ecology of probiotic microorganisms in host environment such as gut gives an ideal picture of their functioning manner and the factors (both host and microbial) responsible for it.

Study of microbial ecology in the gastrointestinal tract is very difficult since gut harbors highly diversified microflora that varies not only at species level but also at individual level. The diversity of gut microflora in two healthy individuals of same species may exhibit variations in their composition and it may be influenced by geodemographic factors also. In this regard, the present chapter deals with the study of ecology of Lactobacillus- most commonly used probiotic bacteria in the gastrointestinal tract which in turn helps in framing selection criteria for screening of potential probiotics.

Recent studies on interaction between human and gut microflora discussed that co-evolution between microorganisms and their host have contributed for the development of a very complex microbial diversity in the gut. Highly diversified microflora in the human gut is a consequence of natural selection at two levels, top-down and bottom-up selection pressure. Hierarchy theory expounds that higher levels compel lower levels for possible organizational solutions i. e. organisms at the higher levels govern the structure or population dynamics of an ecosystem while on contrary lower levels control the structure of ecology when bottom-up level is the selection pressure. In case of interaction between human and gut microflora, being host human is at higher level in the hierarchy for selection and as mentioned above, top down selection pressure is driven by higher levels; host selects the beneficial microorganisms for functional redundancy leading to the development of a microbial community with divergent microbial divisions. Chances for lateral gene transfer also thought to influence the selection process and there by structure of the microbial community. On the other hand, competition among the members of host selected microbiota exert bottom up selection pressure resulting in the development of highly specialized genomes with functionally prominent set of genes. Natural selection at host level obviously favors functionally constant microbial communities which benefits the host with functional redundancy encoded in their genomes. Mean while bottom-up cell-level selection pressure aspire to favor niche specialization to avoid competition between the members of microbial community. In order to be a part of specialized niche, to become more potent microorganisms adapt a particular set of abiotic and biotic factors within the habitat by acquiring new sets of genes essential for their survival and thus escape the competition from decrepit microbial species.

It became clear from the discussions of previous chapters that probiotics perform metabolic functions such as fermenting indigestible dietary residues and endogenous mucus, production of vitamins, and absorption of minerals. They also play key role in intestinal epithelial cell proliferation and differentiation, and the homeostasis of the immune system. Further, probiotics are also known to involve in modifying gut pH, antagonizing pathogens through the production of antimicrobial compounds, competing with pathogens for recept or sites as well as for available nutrients and growth factors, stimulating immunomodulatory cells of the host, and produce a wide range of enzymes such as lactase, amylase, lipase, protease, phytase and so on. The molecular mechanisms of probiotics are largely unknown and opens avenue for research in probiotics. Moreover, current research in probiotics and health consciousness in the public lead to an increased interest towards probiotics from the public, researchers, governmental organizations (such as the WHO/FAO) and medicine and food companies. In this chapter, application of probiotics in treating various diseases and disorders are discussed.

Introduction

The mammary glands of female mammals secrete milk, a necessary food that is liquid and meets the newborn’s nutritional needs. All mammals consider milk to be a complete food for their newborns. It is considered a necessary food for humans and can be consumed as a product or as liquid milk. It contains almost all essential nutrients except iron, which is very low in milk. In essence, milk is an emulsion of protein and fat in water, supplemented with carbohydrates, vitamins, and minerals.

Definition of Milk

• Milk is a complex biological fluid that differs from species to species in both composition and physical properties. It is the full lacteal secretion of a mammary gland that is obtained by milking mammals for a minimum of 72 h after calving or until the milk is free from colostrum.

• FSSAI defines milk as the normal mammary secretion derived from the complete milking of healthy milch animals. It should be free from colostrum.

From a chemical perspective, milk is a dynamically balanced mixture that comes in different forms such as emulsion, colloidal suspension, and true solution. It also contains varying amounts of proteins, fats, carbohydrates, salts, and water.

Gross Composition of Milk

Milk composition varies among different mammals. The average chemical composition of milk in various species is given in Table 1. Buffalo milk and sheep milk contain higher amounts of fat, while human milk comparatively has the highest lactose content. Human milk has lower protein content as compared to milk of other species.

Small and medium-sized industrial units, or small scale industrial (SSI) units, are generally referred to as SMEs, according to the Ministry of Micro, Small and Medium Enterprises. The MSMED Act of 2006, which was updated in 2020, serves as the foundation for the definition of SMEs in India.

• Micro manufacturing and services units: Up to Rs. 1 crore in investments and up to Rs. 5 crore in revenue.

• Small manufacturing and services units: Up to Rs. 10 crore in investments and up to Rs. 50 crore in revenue.

• Medium manufacturing and services units: Up to Rs. 50 crore in investments and up to Rs. 250 crore in revenue.

Small and Medium-sized enterprises (SMEs) constitute the backbone of the global economy. SMEs not only provide major contributions to national GDPs, but they also play an important role in job creation, innovation, and regional development. In India, SMEs account for about 30% of the country’s GDP and employ over 110 million people, making them an important part of the economic structure.(FICCI,2023).

The Indian dairy industry plays a vital role in the nation’s economic and social fabric, deeply connected to the livelihoods of millions of rural families. It is more than just a source of income; for many small-scale and marginalized farmers, it provides a lifeline, ensuring stability and sustenance in areas where opportunities are often scarce. At the same time, the industry faces the immense responsibility of balancing economic growth with ethical practices, environmental conservation, and the welfare of the communities it serves. In this complex environment, businesses operating within the dairy sector have the potential to make a meaningful difference, but only if they prioritize social responsibility alongside profitability. By embracing sustainable practices and fostering inclusivity, these enterprises can address critical challenges while contributing to a more equitable and resilient industry (Christie, 2020; Rotz et al., 2020; Clay et al., 2019).

For the dairy industry, social responsibility is not an abstract concept; it is a pressing need. Across India, small-scale farmers form the backbone of this sector, especially in rural regions where economic vulnerability is widespread. These farmers often face numerous challenges, including fluctuating milk prices, limited market access, and a lack of resources to improve productivity (Kamath et al., 2019; Sadashive et al., 2017). Businesses in the dairy sector can act as catalysts for change by creating fairer systems, empowering marginalized groups, and ensuring that ethical treatment of livestock becomes standard practice. Beyond its immediate economic impact, the industry has a profound role to play in addressing broader social issues, such as gender inequality and food security, while promoting sustainable development that benefits everyone involved (Jaiswal, 2018; Garai et al., 2019).

Indian Food Processing Industry (FPI) is one of the most untapped industries with abundant raw material to grow at a higher rate. FPI has been identified as a priority list in the “MAKE IN INDIA” program by the Government of India to boost its domestic manufacturing and export share. In the last few years, FPI has emerged as a high-growth and high-profit sector due to its immense potential for value addition while processing food products at various stages. The degree of processing of value addition to agricultural produce in India (20 %) is very low as compared to other countries, such as China (40 %), Brazil (70 %), and Malaysia (80 %). In India, the degree of processed food products ranges between 2 per cent (fruits and vegetables) and 35 per cent (milk) for various agriculture products. Hence there exist a huge potential for the growth of this sector in India. The export value of FPI was US$29.12 billion in 2016 and its share in world import was 2.18 per cent (Agarwal & Neogi, 2017).

India’s food processing sector covers fruit and vegetables; spices; meat and poultry; milk and milk products, alcoholic beverages, fisheries, plantation, grain processing, and other consumer product groups like confectionery, chocolates and cocoa products, soya-based products, mineral water, high protein foods, etc. The output of India’s food processing sector is expected to reach USD 535 Billion by 2025-26 (Invest India, 2020). Out of this, foreign investment is around Rs.10,000 crores (APEDA, 2020). Besides this, Government has also approved proposals for joint ventures; foreign collaboration, industrial licenses, and 100 per cent export-oriented units envisaging an investment.

Like other sectors of the economy food processing sector also suffers from certain constraints. The challenges for the food conservation, distribution and processing sectors are diverse and demanding, which need to be addressed to leverage the growth of agriculture and food processing sector. Following are the major challenges and strategies are suggested to overcome the challenges (Sakina, 2019).

6.1. Domestic Constraints in the Development of Food Processing Industry in India

Despite the significant economic potential of the FPI in India, it still faces massive domestic challenges, which include low level of processing, fragmented structure of the industry, consumer perception and lack of skilled manpower. Firstly, low level of processing means that at industrial level, less food is processed, as compared to household level. Most of the traditional food items like jams, jellies, pickles etc. are prepared at small manufacturing units or by households (Agarwal & Neogi, 2017).

Secondly, consumer perception with regard to processed food in India is not very optimistic and they consider that packaged food is not fresh, thus, leading to low consumption of processed food. Thirdly, food processing sector is still highly fragmented and unorganised. This led to the inefficacies in the sector and has failed to achieve the economies of scale (Agarwal & Neogi, 2017).

Introduction
Heat treatment is the most commonly used method in the dairy industry for milk processing. Its primary objective is to eliminate pathogens and reduce spoilage-causing organisms, ensuring milk is safe for consumption and has a longer shelf life. While advanced methods like high-pressure processing, pulsed electric fields, ultrasound processing, cold plasma treatment, and ultraviolet sterilization have emerged, heat treatment remains the preferred choice due to its simplicity, reliability, and proven effectiveness. All dairy products undergo some form of heating during processing, whether through pasteurization, sub-pasteurization (e.g., for milk used in aged cheeses), or sterilization. To facilitate this, liquid heating systems such as continuous heat exchangers or jacketed tanks are widely used, typically powered by steam or steam-heated water. Consequently, steam generation boilers are a standard feature in almost all dairy processing facilities.
The Key Objectives of Heat Treatment Include
1. Elimination of harmful pathogens in milk, ensuring it is safe for consumption and protecting public health.
2. Increasing the keeping quality of milk by reducing the number of spoilage organisms.
3. Inactivating enzymes naturally present in milk or secreted by microorganisms to prevent enzymatic degradation.
4. Preventing the autoxidation of lipids, which can lead to off-flavors and spoilage.
5. Inactivating agglutinin to reduce rapid creaming and maintain uniform consistency.
6. Enhancing the growth of starter cultures by eliminating natural inhibitors and dissolved oxygen in milk, essential for producing cheese and fermented products.

Sterilization is a thermal process aimed at destroying all microorganisms and microbial spores in milk, ensuring the product is microbiologically safe and shelf-stable at room temperature for extended periods. It is primarily used in the production of sterilized milk and evaporated milk, with typical conditions involving heating at 116°C for 15 minutes. This process kills all microorganisms and also inactivates all milk enzymes, including plasmin, which might otherwise contribute to spoilage during storage. However, enzymes produced by psychrotrophic bacteria should not be present in raw milk, as they are highly heat-stable and may remain active even after sterilization. Sterilized milk can be stored at room temperature for longer period. Sterilization kills all microorganisms and inactivates all microbial spores that may germinate under the storage conditions of the product in the market.
The Food Safety and Standards Authority of India (FSSAI) define “sterilization” in relation to milk and milk products as the process of heating the product in a sealed container continuously to at least 115°C for 15 minutes. This treatment ensures that the milk can be preserved at room temperature for a period of not less than 30 days.
In-bottle sterilised milk is a shelf-stable dairy product produced by sealing milk in glass bottles and subjecting it to high-temperature heat treatment. Typically, the milk is heated to temperatures ranging from 110°C to 121°C for 15 to 30 minutes. This process effectively destroys all vegetative microorganisms and bacterial spores, making the milk microbiologically safe and extending its shelf life up to 6–9 months without refrigeration. The heating is usually done in batch retorts or autoclaves after the milk has been bottled and sealed. Although the process ensures safety, it often leads to a slight cooked flavour and some nutritional losses, particularly in heat-sensitive vitamins such as vitamin B1 and vitamin C.

4.1 Phases of technology transfer
To translate laboratory research into market ready product, it is important to understand steps or phases involved in this technology transfer process. The process typically includes six main phases, each with a different role (figure 9).
4.1.1 Research
Technology transfer begins with research, the critical stage of exploring and discovering novel knowledge, technologies, or innovations that may have potential commercial applications. The research phase can occur in academic institutions, research organizations, or private sector companies, often funded by public or private sources. Thorough research ensures that the technologies being transitioned are scientifically and technically robust, thereby increasing their potential for market success. Therefore, the research phase involves creating and evaluating new ideas, confirming their feasibility, and identifying IP prospects, all of which are key components of TT success.
4.1.2 Innovation disclosure
Innovation disclosure is the first formal step where the innovation is reported to the appropriate TTO or IP management team. This process ensures that the institution or organization recognizes the innovation and evaluates its potential for protection and commercialization. It includes following information:

OPERATING MECHANISM OF A FLOUR MACHINE
The flour grinding machine operates using blade cutting, high-speed air impact, and a two-layer destruction function that integrates collision and particle sorting. The principle of operation involves the rotor generating high-speed airflow during blade cutting. As the material accelerates within the airflow, repeated impacts cause it to be destroyed in two layers simultaneously, enhancing the destruction rate. As airflow enters the classification chamber, the destruction process rotates at high speed, and the classification rotor generates centrifugal force. The viscous effect of the airflow creates centripetal force. When the centrifugal force on the particles exceeds the centripetal force, the coarse particles return to the destruction chamber, while fine particles are carried with the airflow to the powder collector for collection.
