1. Introduction

Thermal processing used extensively in the food industry for preservation and shelf life extension of the products (Arnoldi 2001). Heat treatments remain most important in food processing unit operations, not only to achieve desirable changes in eating quality but also for preservative effect by inactivation of microorganisms, destruction of enzymes and insects.Heat is applied in various unit operations through adifferent mode of heat transfer such as conduction, convection, and radiations. 

Food adulteration is a global issue, and because there are insufficient regulations and oversight, developing nations are more vulnerable to it. But in many nations, food adulteration has gone unnoticed. Contrary to popular assumption, milk adulterants can, regrettably, present major health risks that result in fatal diseases. Modern milk adulteration involves increasingly complex techniques, necessitating state- of- the- art research to identify the adulterants. Because milk contains so many nutrients that are needed by both adults and infants, it is referred to as the ideal food. In terms of protein, fat, carbohydrates, vitamins, and minerals, it is among the best sources. Regretfully, milk adulteration is a very common problem worldwide. Potential causes could be the gap between supply and demand, the perishable nature of milk, the low purchasing power of the consumer, and the absence of appropriate detection tests. Because there is insufficient oversight and inadequate law enforcement, the situation is substantially worse in developing and underdeveloped nations. While quantitative detections of adulterants in milk are varied and complex, qualitative detections can be carried out simply using chemical reactions. The type of quantitative detection methods used depends on the milk’s adulterants.

Typical Adulterants in Milk

The addition of vegetable protein, milk from different species, whey addition, and watering are the main adulterants in milk that are known to be economically motivated. There is no serious health risk associated with these adulterations. Some adulterants, though, are too dangerous to ignore. Urea, formalin, detergents, ammonium sulfate, boric acid, caustic soda, benzoic acid, salicylic acid, hydrogen peroxide, sugars, and melamine are a few of the main adulterants in milk that have been shown to have serious negative health effects.

5.1 Introduction

Waste from the dairy processing industry is generated through production of milk products at different stages. With diversification of dairy products, by-products have also gained some importance. Utilization of dairy by- products improves economical and nutritional aspects of milk production and reduces environmental pollution originating from dairy waste. Important dairy by-products include butter milk, ghee residues and whey, the major waste arising from production of cheese, casein, paneer and chhana. Whey arises as a result of protein coagulation/precipitation in the preparation of these products. It is used for manufacture of whey powder, whey drinks and lactose (milk sugar). Whey protein concentrates can be prepared by modern technological methods like ultra-filtration and reverse osmosis. Desi buttermilk is an important domestic beverage since olden days. Ghee residue can be utilized for manufacture of chocolate burfi, samosa filling etc. Hence, utilization of dairy waste particularly whey, butter milk and ghee residues obtained during manufacturing of various main products, has not only increased the availability of nutritional milk foods but has also indicated the profitable method of by products utilization and helped in minimizing the problems of pollution. This chapter focuses on utilization of these dairy industry wastes.

Importance

The dairy products, which have originated in India, are called indigenous dairy products. The products can be broadly classified in to khoa based and channa based. The importance of the dairy products were known to Indians since time immemorial or it could be roughly estimated to be around five thousand years ago and the development could be considered as an art.

Introduction

There has been a considerable progress in the overall production in the dairy sector. Without a proper marketing, the country would not attain the expected rate of growth in dairy farming. Marketing is a flow of goods and services from producer to consumer and users. In this process the activities include moving the goods from the point of production to the point of consumption. The activities like creation of time, place, form and utility are involved. According to Philip Kotler, marketing as a human activity directed at satisfying the needs and wants through exchange process. The performance of the trade activities involved in the f low of goods and services affect the marketing efficiency and producers share in the consumer rupee. A marketing system consists of different milk marketing channels. That marketing channel is considered good in which producer get the highest share in consumer rupee and consumer share is highest in producers rupee. The interest of the Producer is to get the highest possible returns from their milk. Between them, there are marketing intermediaries or middlemen who perform various marketing functions like transporting and retailing. All the intermediaries/ middlemen are also interested to make highest profit from the milk business. The present lesson provides information on the economic aspect of marketing of milk and milk products through a empirical study conducted in Rajasthan state.

1. Ethyl alcohol content in alcoholic beverages is determined by Pyknometer Method or SG (Hydrometer) Method (after distillation). %Alcohol (v/v) = 8610.6 – (16584 x SG) + (7973.3 x SG 2)
2. 1 ml of 0.05N NaOH is equivalent to 0.00375 g of tartaric acid.
3. Volatile acidity of alcohol drinks is measured in terms of as acetic acid. 1 ml. of 0.05N NaOH is equivalent to 0.003g of acetic acid.

5. Esters in Higher alcohol drinks is expressed as Amyl alcohol gms. per 100 liters of abs. alcohol.1 ml of 0.1N NaOH is equivalent to 0.0088g of Amyl alcohol.
6. The concentration of Higher alcohol g/100L is determined by spectrophotometer method using p-dimethylaminobenzaldehyde solution by reading the % T or Absorbance (OD) of developed colour of samples and series of standards in spectrophotometer at 530/535 nm against reagent blank as reference.

The significance of milk in human nutrition is now well established as it is considered as the best, ideal and complete food for all age groups. However, in spite of being so, milk can also serve as a potential vehicle for transmission of some diseases under certain circumstances. Moreover, by virtue of possessing almost all the essential nutritional factors, milk can also serve as an excellent culture and protective medium for certain microorganisms, which may include potential pathogens capable of causing serious health problems to the consumers. In this way, milk may serve not only as a vehicle of transmission of disease causing organisms, but it can also allow these pathogens to grow, multiply and produce certain toxic metabolites, thereby making itself an extremely vulnerable commodity from public health point of view.

A dairy by-product can be described as a valuable commercial product generated during the production of a primary dairy item. Examples include skim milk, buttermilk, residual ghee, and whey, as depicted in the diagram below. Utilizing these by-products not only enhances plant profitability but also makes essential nutrients accessible to humans while reducing environmental pollution from dairy waste. However, converting these edible substances into non-food items is often unjustifiable, particularly in regions facing milk shortages. Effective management of by-products is crucial for ensuring profitable dairy operations, as every component of milk offers significant nutritional value that should be preserved. Consequently, there is growing global interest among researchers in maximizing the utilization of these by-products. Nonetheless, it’s important to note that while many dairy by-products can technically be processed into useful commodities, feasibility alone does not justify their widespread utilization. If capital and resources are to be assigned to a plan to utilise by-products, their processing must be economically viable. Therefore, it is essential to prioritise the research and development of cost-effective technologies for the improving and utilisation of dairy by-products. A dairy by-product can be described as a commercially valuable product generated during the production of a primary dairy product. Examples include skim milk, buttermilk, ghee residue, and whey, as illustrated in the diagram below. Utilizing these by-products enhances operational efficiency, provides essential nutrients for human consumption, and mitigates environmental pollution from dairy waste. However, converting edible materials into nonfood items may not be justifiable, particularly in regions facing milk shortages. Profitable dairy operations depend significantly on effectively managing by-product disposal. Every component of milk should be processed wisely to preserve its nutritional value. Consequently, there is growing global interest among researchers in optimizing the utilization of these by-products. Nonetheless, while it may be technically feasible to process any dairy byproduct into useful goods, it doesn’t necessarily mean it should be done.

Carbohydrates are polyhydroxy derivatives of aldehydes or ketones and undergo all the organic reactions common to the carbonyl groups and hydroxyl groups. The principal milk carbohydrate is lactose. It is a disaccharide. Hydrolysis of lactose with enzyme β-galactosidase yields glucose and galactose.

Lactose is the major carbohydrate present in all types of milk. The first record of isolation of lactose was in 1663, by Bartolettus by evaporation of whey. Milk contains only trace amounts of other sugars, including glucose, fructose, glucosamine, galactosamine, neuraminic acid, and neutral and acidic oligosaccharides.

Lactose plays a significant role in milk and milk products that are

• It plays a major role in the production of fermented dairy products.

• It contributes to the nutritive value of milk and milk products

• It affects the texture of certain concentrated and frozen products;

• It is involved in heat-induced changes in the color and flavor of highly heated milk products.

Status of Lactose

Lactose content varies extensively in the milk of different species. Breed of animal, individuality factors, udder infection, and especially the stage of lactation regulates the lactose content in milk. The lactose concentration in milk decreases gradually and significantly during lactation; this behavior contrasts with the lactational trends for lipids and proteins, which, after a decrease during early lactation, increase significantly during the second half of lactation. Lactose synthesis is hampered during mastitis. Lactose, along with sodium, potassium, and chloride ions, plays the principal role in controlling the osmotic pressure of the mammary system. Thus, any change in lactose content is compensated by a change in the soluble salt constituents. The osmotic relationship between lactose and soluble salts during the secretion of milk partly explains the presence of high lactose in milk with a reduced ash content and vice versa (Table 1).

Types of Enazymes in milk

1. Endogenous and 2. Exogenous.

Three sources of enzyme in milk:

1. The blood via defective mammary cells.

2. Secretory cell cytoplasm. Some of which are occasionally entrapped with fat globules by the encircling MFGM.

3. The outer layer of MFGM is probably the principal source of endogenous enzymes in milk. The outer layer of MFGM is derived from the apical membrane of the secretory cell which in turn originates from the Golgi membrane and acts as the principal source of enzyme in milk.

General Characteristics of Milk Enzymes

1. Deteriorative character e.g. lipase (commercially most important enzyme in milk), proteinase, acid phosphatase, xanthine oxidase.

2. Preservative enzymes. e.g. superoxide dismutase, sulfhydryl oxidase.

3. As an indicator of the thermal treatment history of milk. Related enzymes are alkaline phosphatase, ϒ glutamyl transpeptidase, and lactoperoxidase.

4. Mastitis infection indicator. Related enzymes are catalase, n-Acetyl-β D-glucosaminidase, and acid phosphatase.

5. Antimicrobial activity.

6. Commercial source of ribonuclease and lactoperoxidase

Common Milk Enzymes and their Role in Dairy Industry

Abstract

Vitamin D or “sunshine vitamin” is an essential fat soluble vitamin required for healthy bones. It is responsible for enhancing intestinal absorption of calcium and phosphate. Its deficiency leads to osteoporosis and osteomalacia in adults and rickets and other bone deformities in children. Vitamin D deficiency is being reported to be quite common these days due to modernization accompanied with changes in lifestyle and environmental pollution which limit sun exposure for several individuals. Inadequate sun exposure results in reduced vitamin D synthesis and ultimately poor vitamin D status necessitating compensation through dietary intake. Dietary vitamin D intake is very low in India because of low consumption of vitamin D rich foods, absence of fortification and little use of supplements. It is becoming a major public health problem, needing immediate attention. Fortification of milk and milk products is the safe and effective approach to deal with widespread vitamin D deficiency as milk is consumed and liked equally by all age groups. This paper highlights the importance, sources, recommended allowances and other relevant issues related to vitamin D fortification and its health effects.

Homogenization is now a widely used industrial process in dairy production, essential for stabilizing milk and other liquid dairy products. Its main purpose is to prevent fat from separating out of the milk, ensuring a smooth, consistent, and uniform product. Milk is a complex emulsion comprising water, fat, proteins, carbohydrates, minerals, and vitamins. Among these constituents, fat plays a critical role in determining the texture, flavor, and overall sensory quality of milk and dairy products. In its natural state, milk fat exists in the form of globules of varying sizes, surrounded by a thin membrane that stabilizes them in the aqueous phase. These fat globules typically range in size from 2 to 10 μm and have a lower density than the surrounding water-based phase of milk. This difference in density causes the fat globules to rise and form a cream layer when milk is left undisturbed, leading to an uneven texture and separation during storage.
Homogenization is a mechanical process applied to milk to modify fat globules by forcing the milk under high pressure through a tiny orifice. This reduces the average size of the fat globules while increasing their number and surface area. Practically, this greatly minimizes the tendency of fat globules to rise and form a cream layer. The enhanced stability of homogenized milk is due to three key factors: the reduction in the average diameter of fat globules, as described by Stokes’ Law, which slows their upward movement; the uniformity in size distribution, which ensures globules rise at similar speeds, preventing clustering; and the increased density of fat globules caused by the adsorption of a protein membrane, bringing their density closer to that of the surrounding liquid. Additionally, heat pasteurization complements homogenization by breaking down the cryo-globulin complex, which otherwise promotes clustering and cream formation.
The smaller and uniformly dispersed fat globules create a smoother, creamier texture and enhance the mouthfeel. This process also contributes to the visual appeal of milk, making it appear whiter and more uniform. Homogenization is, therefore, an essential step in modern dairy processing, ensuring the stability, quality, and consistency of milk and other dairy products, while addressing the challenges posed by the inherent properties of milk fat and its lower density.

India

Milk legislation and regulations are designed to prevent fraud and adulteration. But they now cover many factors that affect sanitation and public health. Milk generally is classified into grades according to the care with which it is produced.

Milk lipids or milk fats exist as an emulsion of small spherical droplets called milk fat globules. These globules are very small in size but very large in number. The diameter of the milk fat globules ranges between 0.1 and 22 µm and the number varies between 1.5 and 3.0 billion globules/mL. The average size of milk fat globules ranges from 2 to 5 µm. The average fat globule size in cow and buffalo milk are 3.4 and 4.5 µm, respectively. The surface of the milk fat globules is coated with an adsorbed layer of material known as the milk fat globule membrane (MFGM). MFGM contains phospholipids and proteins in a complex form. MFGM has two main functions (a) fat globule stabilization and (b) preservation of the fat globule’s identity.

General Composition

Triacylglycerols (triglycerides) represent 97–98% of the total lipids in the milk of most species. The diglycerides probably represent incompletely synthesized lipids in most cases. Although phospholipids represent less than 1% of total lipids, they play an important role in being present mainly in the MFGM and other membranous material in milk. The principal phospholipids are phosphatidylcholine, phosphatidylethanolamine, and sphingomyelin. Trace amounts of other polar lipids, including ceramides, cerebrosides, and gangliosides, are also present. Phospholipids represent a considerable percentage of the total lipid of buttermilk and skim milk reflecting the presence of proportionately larger amounts of membrane material in these products.

The primary objective of dairy plant hygiene is to ensure the consistent daily turn-out of safe and clean products which comply with pure-food and public health laws. A secondary and commercially important aim is to preserve the keeping quality of dairy products and so enhance consumer confidence in them. An integral part of a dairy is the quality control laboratory. Continuous testing is necessary for many purposes, including equipment hygiene. Bacteriological standards of dairy products can be maintained only if the raw product is of good bacteriological quality and is protected against contamination from the equipment with which it comes in contact during all stages of processing. 
Many factors may influence the maintenance of dairy equipment in a hygienic condition; the most important are the dairy buildings, the materials and construction of the equipment, personnel, water supply, cleaning procedures, and laboratory control. It is quite impossible to place these points in order of importance, efficient control of dairy plant hygiene being dependent on proper attention to all factors.

10.1 Introduction

Milk is a unique substance in that it is both consumed, as fluid milk with minimal processing and it is the raw material used to manufacture a wide variety of products. From the nutrition point of view, milk is an almost ideal food and considered to be perfect food. The human body needs more than thirty distinct materials in its food supply. No single food stuff supplies all of them but milk supplies nearly all. Since milk by its nature is perishable and an ideal product for bacterial growth, so it must be carefully handled, both during production and while processing. This chapter focuses on the technological (processing) aspects of the transformation of milk into its various consumer products, including beverages, fermented products, concentrated and dried products, butter and ice cream.

Milk production in India is a subsidiary activity of agriculture in contrast to the organized dairy sector in the western countries. Farmers and landless labour maintain one to five milch animals. As a result, small quantities of milk are produced in a scattered manner. Due to this reason, milk procurement models from western countries, such as bulk cooling and bulk transportation are not applicable under Indian conditions. Collection of small amounts of milk is scattered over long distances and, therefore, poses a formidable challenge in maintaining the quality attributes and keeping costs down.

3.1. Rural Milk Collection

A systematic approach to rural milk collection suitable for the tropical climate and techno-economic conditions prevailing in India has been developed, based on the indigenous experience gained over the past few decades. In the first phase, extensive surveys are undertaken in the milkshed areas, where the milk plant is to be established. The second phase involves ‘route planning’ taking into account, availability of quantities of milk, access to roads for plying vehicles and distance from the site of dairy plant. Then zones are identified, representing equal costs of collection and transportation. In the third phase, planning is done for locating the primary collection centres as well as chilling centres, where, milk can be cooled to 4ºC before transporting to the milk plant. Milk may be collected from individual producers either by the contractor or by forming village level cooperative societies.

Bovine milk contains an average of 3.5% protein. The concentration of protein changes significantly during lactation. The first few days of lactation exhibit the main change in protein concentration. The main changes occur in whey protein fraction.

Distribution of Protein in Milk

80% casein and 20% whey protein (β lactoglobulin- 10%, α- lactalbumin- 5%, serum albumin, and immunoglobulin- 5%).

Fractionation of Milk Proteins Fractionation of milk protein is mainly done by acidification at pH 4.6 around 30 °C.

Almost 80% of the bovine milk protein precipitates at pH4.6, and this fraction yielded by precipitation is called casein.

The remaining soluble part of the protein is referred to as whey protein/serum protein/ non- casein protein. Wide variation is observed in the casein- whey protein ratio in different types of milk(protein synthesis is independent of animal diet)

Significant Difference Between Casein and Whey Protein

1. Casein precipitates at pH 4.6 but does not precipitate whey protein at that pH. This property of milk protein is commercially exploited for the preparation of industrial casein and certain varieties of cheese.

2. Chymosin or other proteolytic enzymes produce specific changes in casein resulting in coagulation in the presence of calcium. Whey protein does not undergo this type of coagulation.

3. Casein is very stable to high temperatures. They can withstand heating up to 140 °C for 20 minutes but whey protein is relatively heat labile. They are completely denatured by heating at 90 °C for 10 min.

4. Casein is a phosphoprotein containing an average of 0.85% phosphorous while whey protein does not contain any phosphorous. The phosphate of casein is an important contributor to remarkably high heat stability and calcium- induced coagulation of rennet- altered casein.

5. Casein contains very low sulfur (0.8%) whereas whey protein is relatively rich in sulfur (1%). The principle casein contains only methionine but whey protein contains a significant amount of cystine, cysteine, and methionine. These sulfur- containing amino acids are responsible for many changes in milk on heating.

6. Casein is synthesized only in the mammary gland and no other sources in nature. Some of the whey proteins β lactoglobulin, and α- lactalbumin are synthesized in the mammary gland but bovine serum albumin and immunoglobulin are not synthesized in the mammary gland but derived from blood.

7. The whey protein is dispersed in solution and has a simple quaternary structure. Casein has a complex quaternary structure and exists in milk as large colloidal aggregates.

The salts of the milk include those constituents that are present as ions or in equilibrium with ions. The main salts of milk are phosphates, citrates, chlorides, sulfates, carbonates, and bicarbonates of sodium, potassium, calcium, and magnesium. Approximately 20 other elements are found in milk in trace quantities including copper, iron, lead, boron, manganese, zinc, iodine, etc. These ions are more or less associated with themselves and with proteins. Some metals act as catalysts in the oxidation of milk fat leading to oxidative rancidity and certain metals like Ca, P, Mg, Mo, Co, Fe, etc. are components of metalloproteins such as lactoferrin, lactoperoxidase, xanthine oxidase, and parts of phospholipids.

Distribution of Salts Between Casein Micelles and Serum

The phosphorus is present as orthophosphate, but part of it is bound to organic components like serine and threonine residues of casein, molecules of hexoses and glycerol, phospholipids, etc. Phosphorus is also found in the hydroxyapatite structure of the colloidal calcium phosphate in the micellar structure of casein. The sulfur content of milk is about 0.36 g/kg, but most of it is in the amino acid residues methionine and cysteine of the proteins. About 10% is present as inorganic sulfate.

Physical Equilibria Among Salts

Milk contains several elements but all of them are not entirely in a soluble state. Some minerals exist in colloidal and ionic states at the normal pH of milk. The compounds that are in soluble condition play an important role in keeping various milk constituents in stable condition. A balance exists between the components that are in a soluble state and those which are in colloidal state.

INTRODUCTION

Fruits and vegetables are historically important constituents of human diet and the growing awareness of consumers about the beneficial effects of these commodities could result in enhancement of global trade involving fresh and processed fruits and vegetables. Emergence of postharvest handling of fresh fruits and vegetables facilitated global trade of these commodities. The developed countries started realizing the export potential of these commodities by development of adequate value addition in terms of pretreatments, shelf life extension and packaging besides grading and other associated packing house operations. However, the trade concerning fresh fruits and vegetables could never come out completely from problems related to pesticidal residues, spoilage, bulkiness of the commodities involving transportation of inedible portions and excessive packaging costs arising out of bulkiness. The other problems associated with fresh produce include mandatory requirement of specific storage temperatures with refrigeration as the primary means of regulation of metabolic rate.

Tamarind (Tamarindus Indica)

Introduction

The fruit of tamarind a pod 5 to 15 cm long, 3 to 10 seeds surrounded with edible pulp which is principal souring agent for sauces, chutney, in beverages and in general cooking. Pulp is carminative, laxative, given as infusion in biliousness and febrile conditions. It is also used in dyring and tanning and for polishing and cleaning metal ware. The tartaric acid is extracted from unripe fruits. The polysaccharide (jellose) is extracted from seeds, which is used as a sizing material in the cotton and jute industries. Besides, polyose obtained from the seed is good substitute for fruit pectin in the preparation of jam, jelly or marmalade. The bark and leaves are used for tanning. Tamarind balls are prepared after taking out seeds from the fruit. Tamarind paste and tamarind juice concentrate are the other commercial products.

The fruits, flattish, bean-like, irregulary curved and bulged pods, are born in great abundance along the new branches and usually vary from 2 to 7 in long and from 3/4 to 1 1/4 in (2-3.2 cm) in diameter. Exceptionally large tamarinds have been found on individual trees. The pods may be cinnamon-brown or grayish-brown externally and, at first, are tender-skinned with green, highly acid flesh and soft, whitish, under-developed seeds. As they mature, the pods fill out somewhat and the juicy, acidulous pulp turns brown or reddish-brown.

1. Introduction

Mixing is a fundamental and widely practiced operation in many fields, such as chemical, pharmaceutical, and food processing industries. The mixture’s primary aim is to increase the homogeneity of the material in bulk (Uhl and Gray, 1986; Patterson et al., 2004). Mixing means the random distribution of two or more ingredients throughout a system, which differs from the term’ agitation,’ which is defined as establishing a particular flow pattern with the liquid, especially in a circulatory motion within a container. Mixing is a necessary step in the context of food processing operations. 

For Indian foods

Food processing industries are the fastest growing in India. India is the largest producer of milk, bananas, mangoes, guavas, papaya, ginger and okra. It is the second largest producer of wheat, rice, fruits, vegetables, tea, sugarcane and cashew nut. It is the third largest producer of cereals, coconut, lettuce, chicory, nutmeg, mace, cardamom and pepper at the global level (Highlights of Agriculture Census, 2010-11, http://pib.nic.in/newsite/PrintRelease.aspx?relid=132799). Most part of the income is spent on foods. It is important to establish and nurture mutually beneficial relationships with global food processing, food retail and related supply chain organizations. This will in turn help in the realization of significant business growth opportunities in India, through newer technologies, innovations and ways of value additions. The geographical location of India helps in the export of items to other countries. It is connected to Europe, Middle East and Africa from the western coast and to Japan, Singapore, Thailand, Malaysia, Korea, Australia and New Zealand from the eastern coast. Food processing is a priority sector for the Indian Government, especially in recent times with “Make in India” initiative.The country is considered as one of the most favourable markets because of the easy and affordable credit and other fiscal incentives. The total consumption of food and beverages in India is US$ 369 billion which is expected to increase to US$1.142 trillion and the output in the food processing sector might increase to US$ 958 billion by 2025. This offers a vast market opportunity by the Indian food processing, food retail, transport, logistics and related infrastructure sectors to players in the food processing value chain. The market for plant and machinery in the food processing sector is estimated in the year 2024-25 to be USD 51.41 billion as compared to the current value of USD 17.3 billion (2016-17).

Abstract

Tremendous hike inworld population has increased thrust on the limited resources which has considerably affected the viability of the food. The emerging challenge for policy makers and food scientists is to put forward viable solutions. Utilization of underutilized crops/plants that act as good sources of starch could be explored in a better way for the sustenance of the limited sources like food crops/plants. The demand for starch and the foods containing starch has been increasing continually. Since, the starch in its native form has certain limitations in its functional properties to be used for different applications. Therefore, it becomes important to explore certain technologies which could be used for modification of starch. Among different technologies gamma irradiation ensures food safety while inducing physicochemical changes of the components. Although, the chemical modifications have been used widely so far but the concerns related to the chemical residues left are diminishing their demand. Hence, the physical processes particularly the gamma irradiation process has emerged as an efficient alternative with some benefits over other process like eco-friendly, economical, reliable and safe for altering the physico-chemical and biological characteristics of the product. Gamma Irradiation of starch has been successfully employed for the achievement of some desired physico-chemical, biological and functional properties of the foods and other related items. In this chapter, valuable impact of gamma irradiation on the physico-chemical, biological and functional properties of starch has been summarized.

Studies have shown that modified atmosphere packaging (MAP), and controlled atmosphere storage have the ability to delay quality losses and thus extend shelf life of fresh or minimally processed or fresh-cut produce (Church 1994; Gil et al. 1996a, b; Lee et al. 1995). Modified atmosphere packaging of fruits can result in reduction of respiratory activity, delay in softening and ripening and a reduced incidence of various physiological disorders and pathogenic infestations (Artés 1993).

A. Morphological Examination of Bacterial Samples
Introduction
Bacteria are most widely distributed, the simplest in morphology, the smallest in size and difficult to identify. They are prokaryotic and a few are photosynthetic. Most bacteria are only 0.5 to 2.0 μm in diameter. Bacteria are generally rod, spherical or curved shaped. Rod shaped bacteria may vary considerably in length, have square round or pointed ends and may be motile or non-motile. The spherical or coccus shaped bacteria may occur single, in pairs in tetrads, in chains or in regular masses. The helical and curved shaped bacteria exist as slender spirochetes, spirillum and bent rods (vibrios). In this exercise the ubiquitousness of these organisms will be demonstrated in the air and water, on body and in mouth etc.

Bacteria are morphologically different. This characteristic is helpful in the identification of bacteria. Routine study of bacterial morphology should include examination of stained preparations. Motility should be examined by hanging drop preparation. According to the requirement, certain cell structures may be stained. Stained preparations should be made preferably from fresh agar slant cultures. Smears of Streptococcus should be made from a liquid culture. Morphology of bacteria may be described under the following terms:

1.Shape: Spherical, coccobacillary, short or long rods, filamentous, comma- shaped, curved or spiral forms.

2.Size: Spherical are measured in diameter and rod-shaped in length and breadth. Measurement is expressed in microns (µ).

3.Sides: Straight, concave, bulging, parallel or irregular.

4.Ends: Round, pointed, truncate or concave.

5.Axis: Straight or curved.

6.Arrangement: Singly, in twos, in groups of four or eight, in grape-like bunches, in long chains, or scattered irregularly, may be in bundles, angular arrangements or in Chinese letters.

7.Pleomorphism: Bacteria may differ from their typical shape. Some of the older cultures may depart greatly from their typical forms, and may show spindles, clubs, and filaments, swollen and branching forms. Variation may be both in shape and size.

8.Capsule: May or may not be present. When present, size should be noted. This requires special staining.

Life forms are composed of one of two basic cell types : Eukaryotic or Prokaryotic. Generally, eukaryotic cells are larger and more complex than the prokaryotic cells and possess a membrane-enclosed nucleus; eukaryotic means ‘true nucleus’ (eu=true; karyon = nucleus). All plants, animals, fungi, protozoa and algae are composed of eukaryotic cells. Only the microorganisms classes as bacteria and the archaea are prokaryotic cells. Prokaryotic cells have no nuclear membrane and therefore lack a true nucleus. The latin prefix pro means ‘early’ and in this instance suggests the somewhat primitive nuclear structure found in bacterial cells. Eukaryotic microorganism are sometimes simply referred to as eukaryotes, and the prokaryotic microbes as prokaryotes.

Mushrooms are most ancient, best known and greatly admired fleshy macrofungi. Mushrooms are delicacies, much sought after and greatly valued foods. Wild mushrooms are mostly found in forests, tree trunks, pastures, lawns and road side during winter season and appear at surprising speed. Mushroom hunting or gathering is a popular hobby in Western countries. The wild mushrooms may be edible or unpalatable or poisonous. Poisoning by wild mushrooms is common and may be fatal or produce merely mild gastrointestinal disturbance or slight allergic reaction. The term toad stool is popularly reserved for inedible or poisonous mushrooms, but this classification has no scientific basis. This alarming term keeps many people away from these foods. It is important that every mushroom intended for eating be accurately identified. Mushrooms vary in colour, size, shape, growth habit, yielding ability and other characteristics.

STRUCTURE: Mushrooms are the fleshy fungi which constitute a major group of lower plant kingdom. Mushroom is the conspicuous umbrella-shaped fruiting body (sporophore) of certain fungi of the order Agaricales in the class Basidiomycetes but also of some other groups. Popularly, the term mushroom is used to identify the edible sporophores. The edible reproductive part consists of a stem and a cap. Gills found on the underside of the cap, are arranged like spokes in a wheel. The gills bear multiple spores which start new fungi. The sporophore emerges from an extensive underground network of fine thread like white growth known as mycelium. The mushroom, fruit body produced basidiospores at the tip of club like structures, called basidia, which are arranged along the gills of the mushroom. Beneath the mushroom, in the soil, is the mold colony itself, consisting of a mat of intercoiled hyphae, sometimes several feet in diameter. The mushrooms first appear as white tiny ball consisting of short stem (stipe) and a cap (pileus) which begins to open up like an umbrella. The delicate membrane or Veil (velum) enveloping the cap tears off, if allowed to develop fully, and lamellae (gills) radiating from the stalk into the cap become visible. These gills become darkened as the basidiospores (seeds) develop into millions and fall in the ground for starting their life cycle once again for second generation of mushrooms.

Fungi cause diseases in plants and animals and in such diseases, the fungi actively grow and invade the body of their hosts. There is another means by which fungi can cause harm is growing on stored food material that we consume and produce toxic metabolites referred to as mycotoxins (means fungus poisons). Food is particularly susceptible to fungal infections at almost every stage of storage or production. Mycotoxin is toxic substance produced by a fungus. The term is restricted to toxins produced by fungi growing in human foods or animal feeds. The growth of the fungi in food grains leading to physical spoilage of grains and toxin production is a serious problem in developing countries. Their occurrence in food and feed has both economic and health implications, as the toxic effects in human beings, animals and other living systems were well established. The effects of poisoning by mycotoxin are referred to as mycotoxicoses.

Introduction

Off late our understanding of the composition and functions of the human gut microbiota has increased exponentially and there is a great interest in producing healthy foods in particular that which have an impact in improving the gastrointestinal health such as probiotics, prebiotics and synbiotics. Many of these functional foods are dairy based and have been accepted greatly worldwide. Nonertheless, there has been a need for the development of nondairy probiotic, prebiotic and synbiotic products (Salmeron 2017). This has prompted food scientists and food industrialists to study the feasibility of applying other fermenting substrates such as cereals for the development of innovative nondairy fermented functional foods. The importance of including nanoscience and nanotechnology techniques for the creation of fermented cereal beverages that contain specific bioactive nanoparticles and their role in food packaging systems will be discussed.

Nanotechnology-based preservation employs materials generally measuring between 1 and 100 nanometres. Their high surface-area-to-volume ratio, adjustable surface chemistry and responsiveness to external stimuli enable highly controlled interactions with foods and microorganisms. Nanomaterials may deliver antimicrobial compounds, antioxidants and other active substances in a controlled or targeted manner. Silver, zinc oxide and chitosan nanoparticles can be incorporated into coatings and films to reduce microbial contamination while maintaining sensory and nutritional quality. The chapter discusses nanoencapsulation, nanoemulsions, antimicrobial nanoparticles and nanosensors for detecting spoilage and monitoring shelf life. It also considers effectiveness, controlled release, food applications, safety assessment and potential regulatory concerns associated with nanotechnology.

The act of substituting food or drink with low grade quality ingredients thereby the f inal product will fail to the meet the regulation or standards and in most cases even unfit for human consumption (Augustin et al., 2009). With demand for profit based manufacturing market, there will be increase in points of adulteration with cheaper alternatives or inferior grade ingredients in the production of food or drink (Banti, 2020)]. Adulteration is highly prevails in developing countries such as India, where about 70% of milk supply is adulterated on day to day basis (Bittar et al., 2017). Antioxidants are considered an important class of nutraceuticals which are associated with health improving properties. Antioxidants are compounds which when present in foods at concentrations lower than an oxidizable substrate, markedly delay or prevent the oxidation of substrate (Halliwell, 1999). They are increasingly applied in food systems to retard the oxidation process, particularly in lipid containing foods (Droge, 2002; Lee et al., 2004). The commercially available solutions to counter food oxidation are predominated by synthetic antioxidants such as butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT) and tertiary butyl hydroquinone (TBHQ), among others, which are increasingly rejected by consumers and legitimized by regulators due to long term health implications (Park et al., 2001). As a consequence, the development and utilization of natural antioxidants as alternatives to synthetic ones have attracted global interest among researchers.

The use of spices and herbs in foods was known since ancient times to modify or to improve the flavor. However, the antioxidant properties of only some of the spices have been recognized. Different spices and their extracts such as turmeric, ginger, fennel, rosemary, and sage, among others, are reported to possess very high antioxidant properties, owing to the content of biologically active compounds, which enables their food application (Madhavi et al., 1996). Exploitation of natural antioxidants in consumer goods is increasingly accepted and will gain momentum due to the rise of green consumerism. In this chapter, an attempt has been made to provide an insight into natural antioxidants and colors. Beginning with the source distribution of natural antioxidants, followed by review of extraction methods for their isolation from plant based matrices and bio-preservative properties in vegetable oils to delay rancidity. Lastly, a thorough collection of literature pertaining natural colors has been presented to potentiate the application of clean label ingredients in food systems. The application of natural antioxidants and colors in food products can vouch the food safety with value addition in terms of their nutraceutical properties.

Introduction

Fruits contain various beneficial compounds that possess biological activities and can be used as pharmaceutical nutraceutical products. Most of the fruits contain polyphenolic components that can promote antioxidant potential on human health. Wild Blueberries, strawberries, plums, oranges, grapes, cherries and mangoes are rich in antioxidant. Additionally, anti-inflammatory, antibacterial, antifungal and chemopreventive effects are associated with the various fruits. Besides polyphenols, other compounds such as xanthones, carotenoids, saponins also exhibit health effects. Fruit consumption is considerably increasing in the daily diet because they supply high levels of biologically active compounds that impart health benefits beyond basic nutrition. Fruits provide an optimal mixture of antioxidants such as vitamins C and E, polyphenols and carotenoids, vitamins, phytoestrogens, glucosinolates and anthocyanins. Diets rich in fruits may help to delay the ageing processes and reduce the risk of certain types of cancer, cardiovascular diseases and other chronic diseases. The combination of vitamins, minerals, phenolic, antioxidants and fibre seems to be responsible for these effects. The most dietary components in fruits acting as antioxidants are fibre, polyphenols, conjugated isomers of linoleic acid, D-limolene, epigallocatechin, gallate, soy protein, isoflavones, vitamins A, B, C and E (group of tocopherols), calcium, selenium, chlorophyllin, alipharin, sulphides, catechin, tetrahy-drocurecumin, seasaminol, glutathione, uric acid, indoles, thiocyanates and protease inhibitors.

Pulses are annually grown leguminous crops that yield one to twelve grains/ seeds within a pod, and are often promoted in diet owing to their low cost and many beneficial nutritional effects (Craig 2009). The United Nations general assembly has declared 2016 as the international year of pulses (Oyeyinka et al. 2016). The Food and Agriculture Organization (FAO) describes pulses as the crops that are harvested only for dry grain. This definition excludes crops that are harvested green as food sources (such as green beans and green peas), crops that are used only for sowing purposes (such as alfalfa and clover) and crops used primarily for oil extraction (such as peanuts and soybean). India is the largest producer (around 25%) of pulses in the world and the Indian subcontinent covers the leading area in terms of consumption of pulses. It was also suggested that India can also increase the production output by 30%, considering a rise in government support prices for stimulating the growth of pulses and in case of a normal monsoon season (FAOSTAT 2008). The mainly grown pulses in India include mungbean (green gram), chickpea (Bengal gram), urd bean (black gram), lentil (masur), pigeon pea (arhar), cowpea, horse gram and peas (Tiwari and Singh 2012). In the western countries, nowadays pulses are one of the preferred food sources of the population, owing to ideological reasons and interest in vegetarian diet.

Functional elements are non-conventional biomolecules in foods that have the ability to modulate one or more body metabolic processes or pathways, leading in health advantages and well-being promotion. Research has demonstrated a connection between food, health and well-being functional elements. Consequently, functional elements have health-promoting roles connected with multiple progressive steps at various phases of disease control, from initiation to growth. They can therefore be implemented efficiently in disease therapy and prevention. Therefore, the borderline between food and medicine is becoming very thin at a moment when the role of a healthy diet in stopping non-communicable diseases is well recognized. Functional elements include plant-derived, non-nutritious and biologically active chemicals that operate in the body to avoid certain non-communicable diseases from occurring.

Food contains over 900 phytochemicals. One fruit or vegetable serving (about 120g) can contain as many as 100 distinct phytochemicals. Previously, functional elements were believed to happen predominantly only as phytochemicals in plant products including whole grains, fruits and vegetables. However, in animal goods such as milk, fermented dairy products and cold water fish, probiotics, conjugated linolenic acid, long-chain omega-3, −6 and −9 polyunsaturated fatty acids and bioactive peptides are also discovered. Usually, functional elements happen in various forms in food such as glycosylated, esterified, thiolated or hydroxylated materials. The gut microbiota is the complex and dynamic community of microorganisms that includes various bacteria, fungi and other microorganisms, proliferate and lead a symbiotic/mutual relationship with the host system. These microorganisms protect the host against pathogens by unique mechanisms, helps to maintain shape and strengthen the intestinal epithelium and boost immune response. Diverse bacterial metabolites can immigrate the host bloodstream and other parts of the body via various channels in humans and animals, such as gut-microbiota-brain, gut microbiota-skin, gut-vagina, gut liver, gut-bones etc. However, many aspects of modern lifestyle would alter the gut microbiota and lead to numerous diseases including inflammatory bowel disease, diabetes mellitus, obesity, and metabolic syndrome. Probiotics and other beneficial microbes exert many beneficial effects on their hosts by modulating the gut microbiota. While the term probiotic is reserved only for well-characterised strains with clinically proven health benefits, other beneficial microorganisms include, organisms responsible for the fermentation of foods viz. yogurt, kefir, kombucha, kimchi and many others that have been shown to have distinct health benefits. Interestingly, major group of these beneficial organisms belong to lactic acid bacteria.

Noise has become a very important “stress factor” in the environment of man especially with regard to health. However, not much attention is being paid towards its elimination or control in dairy plants. The harmful effects of noise(s) in the workplace as an occupational hazard is really a cause of great concern. Apart from reducing the work efficiency, in the long run it causes serious auditory and non-auditory effects on the worker. Thus, it becomes imperative to set legal standards in workplaces to be monitored constantly to avoid or reduce the health hazards of the workers.

Abstract

Ghee means the pure clarified fat derived solely from milk or curd or from desi (cooking) butter or from cream to which no coloring matter or preservative has been added. It is the second largest dairy product prepared from milk and it is almost 35% of total milk production. Unfortunately, the producers or the middle- men involved in the ghee trade, tend to adulterate ghee with cheaper oils and fats like vegetable oils, animal body fats, hydrogenated fats and sometimes even the non-edible mineral oils, especially during lean season to earn more money. Recently, the problem of adulteration has assumed a very serious dimension. Such a situation has tarnished the image of dairy industry. Methods presently adopted by food law enforcing agencies to ensure the quality of ghee are mainly based on the physico- chemical constants, but all these methods have some limitations. So researchers are always in search of different innovative methods to check the quality of ghee.

Probiosis has emerged in the early 20^th century after Ellie Metchnikoff proposed his hypothesis that organisms were reponsible for longivity of ethnic people of Balkan region of Russia and ever since it has grow into a major scientific field which has its applications extending into farming, aquaculture and prophylactics in humans. Vast research was carried out on this topic and Lactobacillus sp. and Bifidobacterium sp, are the two important genus that are highly studied and widely recognized universally as conventional probiotics. Apart from these two genus there exists many other bacterial species which have shown promising probiotic potential. Such non conventional probiotics are widely used in some parts of world as commercial food products with health beneficial effects, pharmaceutical products or being tested for their safe utilization in human beings. The present chapter tries to covers some genera and their potential and application in prophylactics.

INTRODUCTION

Food processing as a technological regime is undergoing a revolutionary change in terms of conception, product and process design and energetics. The conventional approach of a food processor is to develop products with a long shelf-life in user friendly packaging systems. Food processors are usually bothered about sensory attributes and microbiological profiles without much emphasis on the fate of heat labile nutritional and nutraceutical components. The changing consumer perception is slowly but steadily leading towards emergence of novel technologies without depending upon conventional thermal processing. A few years before, non-thermal techniques have emerged for food processing and preservation, but these techniques were restricted to framing of fundamentals with regard to the inactivation of vegetative and reproductive bodies of microbes and the deteriorative enzymes.

Non-thermal preservation technologies inhibit microorganisms and enzymes without relying primarily on high temperatures. They are designed to preserve freshness, colour, flavour, texture and heat-sensitive nutrients more effectively than conventional thermal treatments. These methods employ hydrostatic pressure, electrical energy, electromagnetic radiation, reactive species or mechanical forces to damage microbial cells and disrupt essential biological functions. The chapter examines high-pressure processing, pulsed electric fields, cold plasma, ultrasound, irradiation, pulsed light and edible coatings. It explains their operating principles, mechanisms, applications and nutritional implications. These technologies offer promising alternatives for producing safe, minimally processed foods, although equipment costs, process optimisation and industrial scalability remain important considerations.

Introduction

For the year 2016-17, as per the FAO global estimate, the food grain production has crossed over 2.6 trillion metric tons, while the steadily increasing the demand is anticipated to be approximately 3.3 trillion metric tons for 2016-17. Similarly,the global production of all horticultural commodities has crossed over 1.8 trillion metric tons. The global trade of these commodities is purely based on their quality, the demand for good quality produces increases day by day. The term “quality” is a broad terminology used to explain many parameters and differs from commodity to commodity. Usually, the term ‘quality’ is classified into internal and external quality. The external quality refers the external colour, size, shape appearance, uniformity, external damage, cracks and bruishness etc. These parameters may be common for both perishables and durables.

But, in case of internal quality, each and every parameter vary from commodity to commodity, product to product. For food grains, the internal quality refers to moisture content and other nutritional parameters like carbohydrate, protein content etc. But in fruits, the internal quality refers to internal pulp colour, TSS, pH, acidity, juice content, ripeness, other biochemical and nutritional quality parameters. 

Milk fermentation is process by which a change is produced in milk through the activity of microorganism. As milk leaves the udder it serves as a medium for the growth of many species and accordingly undergoes a series of changes, the processes producing these changes constitute the milk fermentation.

Fermentation of organic compounds, especially in the lack of oxygen leads to the rapid break-down of ‘biopolymers’ to produce ‘anaerobic food chains’.

Abstract

Sedentary lifestyle coupled with excess calorie intake is partially responsible for increased incidence of lifestyle related diseases like coronary heart disease, obesity, diabetes, cancer and hypertension. Non-nutritive sweeteners can offer consumers a way to enjoy the sweet taste with little or no energy. Further, functional beverages are the drinks which are altered in such a way to provide specific health benefits and disease preventing properties beyond general nutrition. In the present paper, authors have summarized various research works on development of different low calorie functional fruit and vegetable products by replacing sugar with non-nutritive sweeteners like saccharin, cyclamate, sorbitol and stevioside at different levels of sweetness (equivalent used to sucrose). The cyclamate sweetened spiced plum squash at 50 per cent sweetness proportion gave higher taste scores in comparison to saccharin sweetened beverage. In case of sorbitol sweetened beverages, with the increase in the proportion of sorbitol sweetness, the organoleptic score for colour, body and flavour increased compared to saccharin and cyclamate sweetened products. Whereas, the stevia sweetened beverages indicated highest sensory acceptability at 75% stevioside sweetness level. Further, sorbitol sweetened health products were found to have similar calculated energy value as that of sucrose sweetened products (100%), but sorbitol is absorbed slowly and does not raise the insulin levels. The development efforts had successfully reduced calorie value of plum squash up to 42% with cyclamate at 50% sweetness level. The calorie value of the sorbitol and stevioside sweetened products has been reduced by 70% and 60% per serving at 100% and 75% sweetness level, respectively. The developed products were found to have strong antimicrobial activity against E. coli as well as high antioxidant potential. Overall, it was concluded that, the developed products had better taste, palatability and storage stability beside reduced energy value, hence their availability in the market will definitely benefit the at risk group i.e. diabetics, obese and health conscious people.
