Fermentation plays a major role in our diet and give the basic foods like bread, yoghurt, wine and cereal and legume based traditional fermented foods. The development of fermented food products can be considered as one of the greatest achievements of human civilization and goes back thousands of years. It arose from the necessity to conserve foods, to make them more digestible and also more enjoyable. During the centuries, man learned by trial and error to conduct the fermentation processes by changing physical and chemical parameters in the basic food ingredients. It took much longer, however, to discover the cause of fermentation processes: only towards the end of the 19th century it was demonstrated, that baker’s yeast is the cause of alcoholic fermentation. Through the development of the technique of "pure microbial culture", the basis for a controlled use of microbes in food industry was established.

The unique feature of fermented foods is the vital role of microorganisms that bring about essential bio-trasformations of the substrates during fermentation contributing number of desirable properties such as improved product shelf life, enriched diet with improved flavor and texture, increased safety, enriched nutritional supplement and probiotic functions. Fermentation is a chemical reaction carried out by many types of microorganisms to obtain energy. Fermentation is a process for production of a product by means of mass culture of microorganisms. In fermentation, microorganisms breakdown complex organic compounds into simpler substances. Although chemical changes and microbial growth usually mean food spoilage, in some cases fermentation is desirable and microorganisms are actually added to foods. For example, in the production of beer, wine, and other alcoholic beverages, yeasts convert sugar into ethyl alcohol and carbon dioxide. In the making of yogurt and cheese, lactic acid bacteria convert lactose, a sugar found in milk, to lactic acid. Alcohol, acids, and other compounds produced in fermentation act as preservatives, inhibiting further microbial growth. In addition to its use with alcoholic beverages, cheese, and yoghurt, fermentation is used to produce yeast bread, soy sauce, cucumber pickles, sauerkraut, and other traditional fermented food products. The variation in agroclimatic conditions prevailing in India and diverse form of dietary culture of various ethnical groups produced traditional fermented foods such as idli, dosa (rice-legume based), vada, papad, wari, balle (legume based), bhatura, jelabi, nan (wheat based), paneer, shrikhand (milk based).

2.1 Introduction

Each step in the food industry system e.g. food production, processing, transportation, storage, distribution and marketing, has some impact on the environment and there is much concern about environmental pollution. Due to the highly diversified nature of the food industry, various food processing, handling and packaging operations create wastes of different quality and quantity, which, if not treated, could lead to increasing disposal problems and severe pollution problems [24]. The preservation of the natural environment from industrial pollution is currently receiving much attention. In food industry, the most important problem is treatment and disposal of large quantities of waste water, a by-product of various processing operations. It is one of the largest industry groups comprising the manufacturing sector of the U.S. economy [47]. Likewise, India is the world’s second largest producer of food next to China, and has the potential of being the largest food processor. The total food production in India is likely to double in the next ten years [22]. Flour and grain; soft drinks and carbonated water; breweries; starch and miscellaneous food products; meat, poultry and fish; tea, coffee and other beverages; fruit juices; animal feed; sugar; distilleries and blending of spirits; cocoa, chocolates and sugar confectioneries; agricultural and food chemicals and industrial packaging are important sub-sectors of the food processing industry. Food processing projects involve the processing and packaging of meat products, fish and shell fish, dairy products, fruit and vegetables, grains and beverages production. It includes refinement, preservation, improvement of product, storage, handling, packaging and canning (Fig. 1). The processing may involve receiving and storing raw or partially processed plant, animal or other food materials, processing the raw materials into finished products, packaging and storing the finished products.

India has achieved a commendable position of being the highest milk producing country in the world. Nearly 110 million tons of milk per annum is contributed by small and marginal farmers having 2-3 milch animals which are scattered in lakhs of villages across the length and breath of India. The poor socio-economic conditions are serious constraints in producing raw milk of good quality. The quality of milk is further deteriorated during subsequent handling and transportation. Milk being a product of biological origin, is extremely vulnerable to attack by microbes. It is also a good vehicle for additives and adulterants without any apparent changes in its appearance. Thus, milk is susceptible to several post-secretion changes, some natural and some man-made.

Indian dairy industry faces a mammoth task to meet the world quality standards, particularly in the present context of globalization and increasing quality conscious consumers. In view of the highly perishable nature of milk soon after it is secreted, it is important to monitor its quality by having a firmly installed quality assurance programme along the entire production-to-supply chain. This can be possible with application of sensitive, accurate and rapid methodologies as a tool in quality assurance programmes.

Quality comprises of several attributes ranging from physical, chemical, technological and bacteriological through nutritional to aesthetic. All dairy plants have a quality assurance laboratory (Fig. 8.1) and usually follow chemical quality control with the intention of payments to contractors/producers, processing of milk and meeting mandatory requirements for end products. Quality is judged both by objective and subjective tests.

To ensure safe food and adequate sanitation programs, the equipment used for processing of food products must be designed, fabricated, constructed, and installed according to sound hygienic design principles. This ensures the equipment can be adequately cleaned and sanitized, and that surfaces are resistant to daily exposure to corrosive food products and cleaning/sanitizing chemicals. This chapter focuses primarily on fundamental principles of hygienic design, which protect the product from microbial, chemical, and foreign-body contamination. This is followed by a discussion of general aspects of hygienic construction and design of food equipments, the selection of materials of construction and specification of surface finishes, fabrication, installation and cleaning and sanitization. Quality of raw materials or foods ingredients, proper processing, packaging and storage of finished products decides the quality of the food products. Planning for plant and equipment layout, its design, services (water, air, refrigeration, steam), waste disposal etc. are some of the critical factors, which contributes to quality. In addition, the food processing equipment must comply with strict standards and regulations, which are necessary for securing the quality and safety of the food products to the consumers.

8.0. Introduction

Food additives are the substances not normally consumed as a food by itself and contain or not contain nutritive value but are added to food to improve freshness, sensory and keeping quality of food. So, a food additive is defined as a substance or a mixture of substances other than the food stuff incorporated in food either directly or indirectly as a result of any phase of production, processing, storage or packaging to improve or maintain the nutritional value, enhance quality, consumer acceptability and facilitate the preparation of materials e.g., acid, alkali, bleaching agents, emulsifying & sterilizing agents, flavours, colours, nutrient supplements, clarifying agents, humectants, chemical preservatives etc. Every food available in the market or at home contains food additives. So, now the question arises that whether additives are safe from consumption/toxicological point of view or not? What are the facts or fictions, if additives are to be used in the food preparation? These are the most important questions to be answered and discussed before their use in food industry.

The safety of the food supply suitably remains a high main concern for industry stakeholders, regulatory agencies and patrons. With the surfacing of new safety challenges and issues, companies are establishing and upgrading programs to reduce risk factors. These programs are constantly monitored for reliability, repeatability, reproducibility and effectiveness. Due to the health and safety risks posed by chemical, microbiological and environmental contaminants, analytical methods are progressively more becoming a pride and joy of food safety programs. Innovative analytical approaches are being developed in response to budding food safety issues. To monitor for known issues only the established and officially approved methods are used often. Oftentimes, new analytical methods are developed, improved or modified quickly in response to issues, such as melamine contamination, which are unforeseen. In such instances, accurate data derived from sound, validated analytical methods are required to facilitate industry stakeholders and regulators to make sound methodical decisions.

Through research, industry has improved a host of analytical methods in recent years, resulting in higher sensitivity and accuracy for difficult-to-detect contaminants, detection of contaminants in new matrix classes for grades. These advances have been made in the face of changing set of laws, more painstaking method-validation standards and end user demands for safe, quality products. Further to this, this spirit of innovation will continue to be fundamental in industry’s efforts to ensure the safety of the comprehensive food chain.

Introduction

Food is any substance or a product obtained from nature, which contains nutritive and non-nutritive components that help to maintain or improve the health of an individual if consumed in optimal amount (Sukhneet and Malhotra, 2014). Globalization of food production and procurement makes food chains longer and more complex and increases the risk of food safety incidents. Infections and diseases arising from contaminated/adulterated food remain threats to global public health (Havelaar et al., 2015; Luo et al., 2019). The WHO reports shows that every year foodborne diseases cause the death of 33 million people including many children (WHO, 2019). Food safety is linked to the presence of foodborne hazards in food at the point of consumption. Since food safety hazards can occur at any stage in the food chain it is essential that adequate control be in place. Therefore, a combined effort of all parties in the food chain is required to deliver safe food products to the final consumer. Effective and harmonized food safety systems shall manage and ensure the safety and suitability of food in each link of the supply chain.

Although the food industry has the prime responsibility of ensuring safe foods in most societies, the maintenance of a safe food supply is regarded as a responsibility of the government of that country. This responsibility has, over many years, led governments to adopt legislation, standards and regulations for food processing and to impose penalties when a business fails to meet the expectation. As with any legislation, an effective system for detecting failures to comply with the legal requirements increases compliance and hence, in this case, promotes food safety. Governments have an obligation to protect consumer health and this includes protection against food borne diseases. Food standards are therefore necessary to aid governments in protecting public health. However, the standards can only be effective when they are enforced through an efficient food control system. This therefore requires comprehensive legislation inspection, food monitoring and food borne surveillance. An efficient food control system must be supported by competent staff with good laboratory services. Political and institutional support and stability are also important elements.

Introduction

Food is a resource of vital importance and its safety in the whole chain, from producer to consumer, is a worldwide concern. In fact, as food trade expands throughout the world, food safety has become a shared concern among all consumers. This issue began to be taken seriously at a period where there is a significant increase of illness caused by infected food in both developed and developing countries. Unsafe food contains hazardous agents or contaminants that can make people sick, immediately or by increasing their risk of chronic disease. Contaminants can enter food at many different points in the food production process, and can occur naturally or as the result of poor or inadequate production practices. International competitiveness depends more on quality and safety concerns than on prices. Governments and local authorities intervene in the market place in setting technical regulations; and sanitary and phytosanitary measures. This encouraged food processing companies around the world to implement food safety management systems which guarantees the production and distribution of safe foods. Prerequisite Programs (PRPs) are considered as the integral part of food safety standards and audit schemes all over the world. It is essential to implement food safety programmes in every company to check the chances of illness or injury due to unsafe food.

The conventional thermal processing technologies are dependent on high temperature to control the growth of pathogenic and spoilage causing microorganisms. However, the exposure to high temperature for prolonged time results in several biological, chemical and physical modifications leading to their sensory, nutritional and textural changes. Currently, consumers are more interested in minimally processed food products with improved safety and shelf life. In order to fulfill the market demand, innovative non-thermal food processing techniques to inactivate the microorganisms have been developed. These techniques retain freshness, nutritional value and sensory characteristics of food items without any significant thermal degradation.

Non-thermal technologies are used in interdisciplinary sciences, and in many other applied areas. The three main pillars related to the use of novel food technologies are food safety, quality and environmental impacts. Besides the food safety and quality dimensions, these non-thermal processing technologies have the possibility to shorten treatment time, lower energy consumption, and lower carbon footprint. Depending on the source of energy transfer, non-thermal technologies have different types of action. It includes inactivation of microorganisms in radical formation (plasma, ultrasound, ozonation, UV light, etc.); mechanical action through hydrodynamic effects, shock waves (ultrasound and plasma), electric and magnetic fields; or extremely high pressures that are causing disruption of the cell organelle.

The novel non-thermal technologies destroy the pathogens at room temperature as well as utilize less energy compared to conventional ones and have the potential of developing new food products having distinctive functionality. For optimizing the product quality, time for processing and also to inactivate the enzymes and bacteria, each of these techniques can be used either alone or in combination. The adverse effect of some technologies on the sensory, texture, and nutritional values of food could be overcome by using hurdle technology. Combination strategies are more efficient for improving the food quality and have the potential to ensure the microbial safety of foods. An overview of the effect of novel process technologies on the quality and safety of food is elaborated in this chapter.

Introduction

A food safety system revolves around different aspects, beginning right from the farm, where the food is created and transported to where the customers purchase, eat and dispose. This includes production, processing, distribution, preparation, marketing, access, consumption, and disposal. These processes need to have numerous resources like people, business, farms, communities, interventions, policies, and politics. All steps ought to be coordinated for an organisation to make progress. In today’s world of processed foods and industrial farming practices, ingredients and preparation procedures are typically uncertain. In order to reduce the confusion of consumers and to provide quick, straightforward identification of the commodities they’re searching for, many items are now “certified” by revered organizations.

Food safety certification is a third-party verification, to ensure that commodities, processes or systems in the food supply chain meet accepted food safety standards. It is distinct from different systems like supplier declarations, laboratory test reports or inspection body reports. Food certification is predicated on the results of tests, inspections and audits and provides confidence to the buyer as a result of an organization’s commodities or system are being completely evaluated against accepted national and international business standards by a competent third body.

Milk is a product of biological origin and is a suitable vehicle to accommodate any additive without apparent changes in its look. The quality of milk and its products depends upon quality of raw milk used in their manufacture, processing and handling conditions. It is therefore, necessary to check quality of raw milk to assess its suitability for processing, through various quick tests called “Platform Tests”

Raw milk quality assessment

(A) At collection center: - Milk from various suppliers is generally collected at dairy factory or privately owned collection centers located in marked area of milk sheds. The quantum of supply may vary from 2 – 100 Liters. As each supplier has to be paid in relation to quantity and quality of his produce, it is important to draw samples and ascertain its quality by performing quick tests for the purpose of acceptance or rejection.

Sampling procedures - The sampling procedure differs according to the nature of material and the purpose for which the sample is required. The sample collected for chemical analysis should be representative of the entire batch. Thorough mixing with proper instrument is essential to ensure representative sample. Samples for chemical analysis are to be delivered the same day for testing. If un-avoided, add small amount of preservative (Formaldehyde) to prevent deterioration and bear label to the effect.

Sample from single container – The procedure involved is thorough mixing of contents. If it is small container the contents should be poured from one vessel to another with swirling. In case of can the contents should be mixed with the help of plunger which should be moved up and down and sideways for about 10-15 times. The sample is then drawn with the help of dipper from different levels and collected in clean and dry sample bottles.

A. Estimation of Calcium

Requirements : Pottasium permanganate solution (0.1N) – Dissolve by heating 33g of potassium permanganate in 1000ml distilled water and allow to stand in coloured bottle for several days. Filter contents through 6mm thick film of asbestos mat on Gooch crucible.

Asbestos mat – Digest asbestos with dilute hydrochloric acid(1:3) for 2-3 days, wash free from acid and digest with 10% sodium hydroxide for few days, wash free from alkali. Digest with dilute Nitric acid(1:3) for several hours and wash. Shake with water into fine pulp and digest with 0.1N potassium permanganate solution that has been acidified with dilute sulphuric acid (1:3), for 1 hour and wash. Use this pulp for layering 6mm film on Gooch crucible.

Dilute hydrochloric acid (1:4), Ammonium hydroxide solution (1:1), Saturated ammonium oxalate solution, Diluted sulphuric acid (1:4)

Fermentation has been an integral part of food processing throughout the history of mankind. In beginning, it was mainly preservation method, then it became key process in substantial sensory characteristic development and now it is utilized to improve overall properties of outcome from major industries like bakery, dairy, beverages, etc. The human understanding of controlled fermentation process changes its fundamental objective by exploring its success in development of rheological and texture characteristics.

The biochemical transformation of raw food due to fermentation affects the organoleptic as well as rheological properties of a product. The changes in rheological as well as sensory properties is related with the modification of major component by the action of microorganism. For example, transformation of polysaccharides in bread dough by action of yeast produce ethanol, CO₂ and other simple compound which modify sensory as well as rheology of dough. The major micro-structural, bio-compositional and bio-chemical changes are due to microbial action are frequently described to understand the effect of fermentation on rheological as well as sensory properties of food products. The rate and quality of these associated major changes mainly depends upon concentration of saccharides for growth of microorganism as well as nature and existing microflorae. Hence, a proper monitoring of changes in rheological and sensory properties is necessary to optimize the controlled fermentation as well as design of process parameters from engineering and consumer point of view.

The biochemical changes directly responsible for changes in basic rheological and sensory characteristic including flow behavior, consistency, viscoelastic properties, hardness, adhesiveness, color, aroma, flavor and mouthfeel. The food industry is so diverse and exploring new and possibilities to catch diverse consumer worldwide, a proper understanding of effect of fermentation on mentioned properties will be key to hold competitive market. Hence, the present chapter will cover the basics of rheology and its role in food industry, effect of fermentation on rheological and sensory attributes of major class of food.

Introduction

Consumers are nowadays very much concerned about the food they purchase and consume. Consumer wants the food containing antioxidant properties or can say functional food in safe and stable forms, so that the availability of daily requirements of functional food ingredient must be ensured for normal growth and development of the body. The functional food that can provide a health benefit such as increased dietary fibre, vitamins or minerals to the body. The incorporation of antioxidant compounds acts as an efficient way to fight against reactive oxygen species (ROS) generated in our body. As it is already known that the ROS causes oxidative stress and acts as a main trigger for different life threatening chronic diseases like cancer, diabetes, cardiovascular disease, aging etc. Therefore, seeing the consumers’ demand for value added products with bioactive ingredients, all small and large scale food industries are taking initiatives to process different types of food (fruits, vegetables, dairy, sea food, animal, microbial products etc.) to extract and purify its active fraction of functional ingredients to valorize different value added products. Functional ingredients may also be derived from different food wastes generated during processing of food. This practice provides additional economic benefits to food businesses. Food industries are also giving importance to different processing methods to extract high quality of functional food ingredients in large quantity because processing method affects the concentration of extracted bioactive compounds. The simple addition of functional ingredients may cause an unwanted and negative change of sensory and texture of food. Therefore, using novel processing technologies such as microencapsulation, the negative changes could be minimized or avoided because these technologies could prevent the inactivation of bioactive ingredients.

Introduction

Pulses are annually grown leguminous crops that yield one to twelve grains/ seeds within a pod, and are often promoted in diet owing to their low cost and many beneficial nutritional effects (Craig 2009). The United Nations general assembly has declared 2016 as the international year of pulses (Oyeyinka et al. 2016). The Food and Agriculture Organization (FAO) describes pulses as the crops that are harvested only for dry grain. This definition excludes crops that are harvested green as food sources (such as green beans and green peas), crops that are used only for sowing purposes (such as alfalfa and clover) and crops used primarily for oil extraction (such as peanuts and soybean). India is the largest producer (around 25%) of pulses in the world and the Indian subcontinent covers the leading area in terms of consumption of pulses. It was also suggested that India can also increase the production output by 30%, considering a rise in government support prices for stimulating the growth of pulses and in case of a normal monsoon season (FAOSTAT 2008). The mainly grown pulses in India include mungbean (green gram), chickpea (Bengal gram), urd bean (black gram), lentil (masur), pigeon pea (arhar), cowpea, horse gram and peas (Tiwari and Singh 2012). In the western countries, nowadays pulses are one of the preferred food sources of the population, owing to ideological reasons and interest in vegetarian diet.

Snack foods have become an essential part of the diet throughout the World and they are prepared from natural ingredients or components to yield products with specified functional properties. Extrusion cooking technology getting more popularity over other traditional processing technologies because extrusion shows continuous efficient cooking, mixing and forming process.

Food provides a sense of wellbeing and comfort and makes people feel good. In this world of a growing population, the need for affordable, safe and good quality food is rising constantly. On the other hand, there is growing awareness of customers who demand that food be produced and supplied hygienically in socially responsible and eco-friendly ways.

Abstract

In biocatalysis, isolated enzymes, enzyme mixtures, immobilized enzymes or microbes (enzymes that are still present within the living cells) are used to perform chemical transformation of organic compounds into novel compounds. Both in academia and across chemical and pharmaceutical industry, biocatalysts are used as isolated preparations or in whole cell format or as recombinant proteins produced in alternate host cells. Biocatalysts catalyze novel small molecule transformations that are usually difficult or impossible using traditional synthetic organic chemistry. Biocatalysts exhibit high chemoselectivity, regioselectivity, diastereoselectivity and enantioselectivity towards their substrates. As a result, the use of biocatalysts during chemoenzymatic synthesis minimizes the issues of unwanted side-reactions such as decomposition, isomerization, racemization and rearrangement. The process of biocatalysis has become an important tool in the synthesis of active pharmaceutical ingredients (APIs) and enantiopure compounds. Biocatalysis offers a more sustainable, efficient, and less polluting methods for the production of APIs and advanced pharmaceutical intermediates. Biocatalysts have received tremendous attention in pharmaceutical industry because they typically catalyze reactions under mild conditions, so they do not consume much energy or emit much greenhouse gas. Biocatalysts are currently employed for the development of products in different fields, such as pharmaceuticals or intermediates of their production (e.g., antibiotics, statins, and enantiopure building blocks), fine chemicals (e.g., amino acids and vitamins), and food ingredients (e.g., sweeteners, lipids, and nutraceuticals). However, it would be helpful for the pharmaceutical industry to take advantage of developments in biochemistry, molecular cloning, random and site-directed mutagenesis, advanced tools for enzyme discovery, enzyme-directed evolution, high-throughput laboratory evolution techniques for biocatalyst optimization, immobilization, and fermentation technology to gain access to a new class of biocatalysts (enzymes), cells and other microbes.

Abstract

Fruits like orange (citrus sinensis), mango (mangifera indica), banana (musa paradisiaca), guava (psidium guajava) and pomegranate (punica granatum) contain numerous vitamins, minerals, fibre. These fruits also contain phytochemicals, antioxidant and bioactive compounds including alkaloids, flavonoids, tannins, saponin, terpenoids, which enhance the nutritional value and reduce the free radicals and oxidative stress in human body. These fruits also show the anti-cancer, anti-bacterial, anti-fungal, anti-inflammatory, anti-arthritic, anti-obesity, anti- diabetic, anti-proliferative, anti-hypertensive properties and are very effective against the pathogenic bacteria, which causes the harmful disease in human body. Between 1951-79, the Indian economy had grown at an average rate of 3.1 percent a year at constant prices. Growth in the industrial sector had been about 4.5 percent a year, while for the agriculture sector, growth was 3.0 percent over that period. Many of the political leaders associated with the movement were also in support of a socialistic development pattern. They favored state interference in the economy. They encouraged state ownership of core industries.

Concept of Entrepreneurship

Entrepreneurship can be defined as the propensity of mind to take calculated risks with confidence to achieve a pre-determined business or industrial objectives. That points out the risk-taking ability coupled with decision making. The word ‘entrepreneurship’ typically means to undertake. It owes its origin to the western societies. But even in the west, it has undergone changes from time to time. In the early 16th century, the term was used to denote army leaders. In the 18th century, it was used to denote a dealer who buys and sells goods at uncertain prices. Towards 1961, Schumpeter, used the term innovator, for an entrepreneur. Two centuries before, the concept of entrepreneurship was shady. It is only in the recent years that entrepreneurship has been recognized widely all over the world like in USA, Germany, Japan and in the developing countries like ours. Gunnar Myrdal rightly pointed out that Asian societies lack entrepreneurship not because they lack money or raw materials but because of their attitudes. Till recently, in the west, the entrepreneurship is mainly an attribute of an efficient manager. But the success achieved by entrepreneurs in developing countries demolishes the contention that entrepreneur is a rare animal and an elusive character. In India the definition of an entrepreneur being the one who undertakes to organize, own and run a business has been accepted in a National Seminar on entrepreneurship organized in Delhi in 1975. Still there has been no consensus on the definition of entrepreneurship and qualities of entrepreneurship.

In India, about 46 per cent of the milk produced is either consumed at the producer level or sold to non-producers in the rural area, the balance 54 per cent of the milk is available for sale to organized and unorganized players. The organized sector comprises of Government, Producers’ Owned Institutions (Milk Cooperatives & Producer Companies), and Private players which provides a fair and transparent system of milk collection round the year at the village level. The unorganized/informal sector involves local milkmen, dudhias, contractors, etc. and they are mostly found to be opportunistic, as there is no uniformity of milk price paid to producers and it varies depending upon the situation. The possibility of adulteration of milk is higher among these unorganized groups. In the areas where competition is high and the presence of the formal sector is strong, the unorganized sector generally gives higher prices and at the same time, the unorganized sector doesn’t offer remunerative prices to the producers where the organized sector is not present.

4.1 Introduction
Human milk widely acknowledged as the optimal source of nutrition for infants, providing a rich array of components crucial for their growth, repair and development. However, the composition of human milk can vary
significantly within and between feeds, throughout the day, over the course of lactation, and among different mothers and also populations. While this variability is beneficial for infant health and survival, it presents challenges for the management of nutrition of high-risk infants who require precise oversight. The composition of human milk can be altered by factors such as the handling of expressed milk, including how it is stored and pasteurized. Thus, proper management of expressed milk is essential. The recommended practice for infant nutrition is exclusive breastfeeding for the first six months, followed by continued breastfeeding for at least one to two years. Human milk is naturally suited to meet the nutritional needs of infants, providing both nourishment and bioactive compounds that support healthy growth and immunity.
Human milk contains a variety of bioactive components, such as immune cells, anti-infective and anti-inflammatory agents, growth factors, and prebiotics. In contrast to infant formula, which has a fixed nutritional profile, human milk is dynamic and can vary between and within feedings, influenced by maternal factors, environmental conditions, and the methods used for expressing and managing milk.
A thorough understanding of human milk’s composition is vital for effective infant feeding, especially for at-risk infants. It also allows for the assessment of how milk storage and pasteurization may impact its beneficial components. Additionally, some of the bioactive elements in human milk are being studied for their potential use in medical treatments, either as preventive or therapeutic agents.

Preservation of raw milk is essential to maintain its quality during storage and transportation before processing. One of the primary methods for extending its storage life is refrigeration, where milk is cooled to 2°C to 4°C immediately after milking. This significantly slows down the microbial growth and enzymatic activity. Bulk milk coolers (BMCs) are vital in achieving rapid cooling, especially in collection centres or dairy farms, where they ensure that milk remains fresh during storage and transportation. BMCs are particularly essential for regions with inadequate cold chain infrastructure, as they help maintain milk quality until it reaches processing facilities.
In addition to refrigeration, thermisation is another method used to preserve raw milk. Thermisation, a mild heat treatment, is widely used to extend the shelf life of raw milk, particularly when it needs to be transported over long distances. This process involves heating the milk to 57–68°C for 15 seconds, effectively reducing the microbial load while preserving the milk’s natural characteristics. Thermisation is typically followed by refrigerated storage, where milk is cooled to temperatures between 2° and 4°C to inhibit further microbial growth. The combination of thermisation and refrigeration ensures that milk retains its freshness and safety until it reaches processing facilities, even in regions with extended supply chains.
Raw milk also benefits from its natural inhibitors, such as lactoperoxidase, lactoferrin, and immunoglobulins, which exhibit antimicrobial properties and slow down bacterial growth. The lactoperoxidase system, for instance, can be activated by adding small amounts of hydrogen peroxide and thiocyanate to enhance milk’s preservation in the absence of refrigeration. The use of chemicals like hydrogen peroxide (H2O2) for milk preservation is not permitted in India due to safety and quality concerns. However, the FAO recommends its application under strict regulatory conditions in some countries as part of the lactoperoxidase system, particularly in regions where refrigeration is unavailable.

Introduction
Understanding the concepts of technology transfer, licensing, and commercialization is crucial as it plays an important role in understanding how scientific discoveries leads to generation of new technologies further making them the impactful solutions that benefit industries and society. In the context of Indian HEIs, this especially important because a large volume of impactful research often remains underutilized due to limited commercialization channels. This chapter explains the terminology, essential components of technology transfer, outlines its significance for the innovation ecosystem. It also outlines the evolution of India’s technology transfer ecosystem, and emphasizes while understanding its potential to boost India’s economy, encourage entrepreneurship, and strengthen global competitiveness. From initial idea to a market-ready product is complex and multiphased process. The stepwise process is shown in Figure 1. It highlights a structured pathway consisting of five core phases: Idea/Concept, Technology development, Intellectual Property (IP) rights, Technology transfer, and Technology commercialisation.
Phase 1: Idea/Concept stage
This process of technology transfer starts with the Idea/Concept phase, where an invention is created. Each phase plays an important role in transforming raw scientific knowledge into innovative solutions that benefit society and generate economic value. In this phase breakthrough ideas emerge, within labs. Researchers explore and develop initial proof-of-concept or prototypes to validate their ideas. At this stage, the focus is primarily on knowledge creation rather than commercialization. This pathway of technology transition is summarized in Figure 1.

A TTO needs a planned budget of five years to sustain it in the long term. This involves budgeting the infrastructure, manpower, research, and outreach programs. The budgetary needs of a TTO will be based on the size and scope of the TTO and the maturity of the parent institution it caters to. The initial years will be focused on capacity development, the appointment of experts, and the establishment of processes of intellectual property management. The mature TTO will generate income through the returns of the licensing agreements and the collaborative efforts with the industry. Nevertheless, external funding through grants and government schemes plays a vital part, particularly in the initial years. The planned budget ensures long-term stability and development of the TTO.
9.1 Budgetary heads
9.1.1 Operational expenditure
Operational expenditure refers to the ongoing costs incurred by a TTO to maintain its day-to-day operations. This includes the cost of maintaining the office, including rent, power and utility bills, computer and network infrastructure, patent management cost, and administration charges. The filing and legal charges also fall within this category. The overheads will be a heavy burden if not planned with finances properly. A TTO has to be provided with a properly planned operational budget that covers the daily operational expenses. The operational expenses help the office perform effectively, sustain the employees, and effectively manage IP. The operational expenses that the budget normally covers include:

Technology transfer (TT) is entering a transformative phase shaped by globalization, digitization, and the growing role of start-ups in the innovation ecosystem. Traditional linear models of TT where inventions flowed from academic laboratories to industry through licensing are being replaced by dynamic, multi-directional, and collaborative frameworks. This chapter explores emerging trends that will define TT in the coming decades, including open innovation platforms, digital TT ecosystems powered by artificial intelligence (AI) and blockchain, the rise of entrepreneurial start-ups and spin-offs, internationalization of TT through cross-border collaborations, and sector-specific shifts driven by 5G, biotechnology, drones, and green energy. Drawing from global and Indian contexts, the chapter highlights how universities, governments, and industries can leverage these trends to build inclusive, resilient, and sustainable innovation ecosystems.
Three global shifts which will redefine TT
1. Digitization of knowledge: With AI, big data, and blockchain, knowledge and IP can be shared, tracked, and commercialized faster and more transparently.
2. Entrepreneurial ecosystems: Start-ups, incubators, and accelerators are replacing traditional firms as vehicles of commercialization, particularly in deep-tech and frontier technologies.
3. Globalization of innovation: Challenges such as pandemics, climate change, and food security require cross-border TT collaborations, making TT an instrument of both economic and geopolitical significance.

The operation and maintenance of Dal Mills and Oil Mills are crucial components in ensuring the efficient processing of pulses and oilseeds. These mills play a significant role in the food processing industry, where the transformation of raw pulses and seeds into consumable products is vital for meeting the needs of consumers worldwide. The proper functioning of these mills requires a wellstructured operation strategy, which includes careful planning and execution of each process from raw material intake to the final product output. For Dal Mills, the primary operation involves cleaning, de-hulling, splitting, and polishing pulses, while for Oil Mills, the process revolves around seed cleaning, pressing, and extraction of oil from oilseeds like sunflower, soybean, and groundnut. Maintenance is a critical aspect of ensuring the smooth operation of these mills. Regular maintenance schedules, including inspection of machinery, replacement of worn-out parts, and calibration of equipment, help prevent costly breakdowns and extend the life of the machines. Preventive maintenance practices also contribute to the overall efficiency of the mill by minimizing downtime and optimizing energy consumption. Furthermore, the quality of the final product is closely tied to the condition of the milling machines. Proper maintenance ensures the production of high-quality dal and oil that meet industry standards and consumer expectations. The effective management of both operational processes and maintenance procedures is essential for the profitability and sustainability of Dal and Oil Mills. Skilled personnel, adherence to safety guidelines, and a proactive approach to troubleshooting and repairing equipment are key to achieving consistent output and high product quality. This chapter will delve into the specifics of the operation and maintenance practices required to run Dal Mills and Oil Mills efficiently, providing insights into best practices, challenges, and solutions that contribute to the overall success of these milling operations.

Food preservation involves treating and safely handling food to prevent or delay spoilage while retaining colour, texture, flavour and nutritional value. Food deterioration may result from microbial growth, indigenous enzymes, oxidation, physical damage, insects, moisture, temperature and other environmental conditions. Bacteria, fungi and other microorganisms contaminate food through soil, water, air and biological sources. The effectiveness of preservation therefore depends on controlling intrinsic factors such as pH, water activity, nutrients and redox potential, together with extrinsic factors such as temperature, humidity and storage atmosphere. Understanding these mechanisms provides the scientific foundation for selecting safe and effective preservation methods.

Introduction

Food and nutraceuticals are obtained from various agricultural resources available in this planet. Many types of bio-active compounds are available in small quantities in the plants and animals which are evidenced to improve performance of various organs, increase in immunity and cure for some diseases. Last decade evidences several advancements in developing phytochemical formulations which can be used as a cure for many diseases as well as helps in boosting immunity in human being. Such materials exist in different form, structure and chemical compositions. Examples of such chemicals are phenolic and organosulphur compound (Pascall 2011). The vegetables, fruits and seeds are used without further processing. Some plants are subjected to cooking before its consumption. Many industries are carried out extraction of bioactive compounds and developed products in the form of tablets, powders and liquids which are available in the market. In order to make commercial process more economic and feasible, long term storage of plant residues (Raw materials) as well as the prevention of the extracts emerges as essential requirement for the industries. Moreover, the products requires suitable packaging solution to increase its self-life, preventing it from the influences of environment, and to make viable solution for easy access which makes it more user-friendly. Suitable packaging solution is required for mainly the three reasons: (i) prevention. (ii) protection and (iii) presentation. Prevention is required in-order to avoid deterioration of the packaged items due to microbial growth, loss in moisture and enzymatic action. Protection is required for the purpose of protecting the packaging materials from the contamination as well as from the environment impact and rough handling. Presentation is equally important to provide it an aesthetic look to make it more approachable to the consumers. Moreover, packaging also offers “labelling for easy identification, warnings, instructions, and nutritional information, ease of transportation” (Pascall 2013).

Water is an essential component of all living things. Although once believed as a resource with a never-ending supply, it has now been understood that water is becoming increasingly scarce and therefore a proper management is necessary to keep a sustainable food production (Kannan & Anandhi, 2020). A continuous and safe supply of water is indispensable for the food industry where it has numerous applications along the agriculture and food production processes.

At present, food and nutrition security are the prime aspects which need to be addressed in an efficient way. It has been projected that by 2050 the global population will reach 9.2 billion which in turn enhances annual demand for agricultural products by 1.1 per cent from 2005 to 2050 (McKenzie and Williams 2015).

The operation and maintenance of dehusking, dehulling, degerming, and drying equipment are crucial in ensuring the efficiency and longevity of these machines in grain and seed processing industries. These machines play a vital role in removing husks, hulls, and germs from grains, as well as reducing moisture content to enhance storage stability. Proper handling and regular maintenance not only improve performance but also reduce downtime and operational costs. Dehuskers are used to remove the outer husk from grains like paddy and millet. Their efficiency depends on factors such as roller pressure, feed rate, and machine alignment. Routine maintenance involves checking for wear and tear on rollers, adjusting pressure settings, and ensuring that all moving parts are well-lubricated. Similarly, dehullers remove the outer shell of seeds and grains, requiring careful calibration to avoid excessive grain breakage. Blade sharpness, motor performance, and sieve integrity should be regularly inspected to ensure optimal functioning. Degermers are employed to separate the germ from the endosperm in grains like maize. This process enhances the shelf life of processed products and improves their quality. Regular maintenance of degermers involves inspecting the abrasion plates, checking the feed rate, and ensuring that airflow mechanisms are clear of obstructions. Any malfunction can lead to uneven separation, affecting the final product quality. Dryers are essential in reducing the moisture content of grains to prevent microbial growth and spoilage. They require proper temperature control, uniform airflow, and regular cleaning of heat exchangers and drying chambers. Overheating or under-drying can compromise the grain quality and lead to storage losses. Timely inspections of sensors, air ducts, and burner efficiency help maintain effective drying operations. A well-planned operation and maintenance routine ensures these machines function optimally, increasing productivity and product quality while reducing energy consumption and repair costs.

Definition

It is one of the important portion of milk which forms a fatty layer on top of milk when left un-disturbed. It is a prime component of milk and comprises mainly of milk fat. It may be defined as “that portion of milk which is rich in milk fat” meaning portion of milk into which larger portion of milk fat has been gathered.  According to FSSAI, 2011 Malai and Cream are defined as –

Malai means the product rich in butter fat prepared by boiling and cooling cow or buffalo milk or a combination thereof. It shall contain not less than 25.0 per cent milk fat.

INTRODUCTION

Food processing is necessary for the conversion of raw food products in to finished products with desired textural, sensory and nutritional attributes. This is required to be done mainly due to seasonal production and facilitating non-seasonal availability of different commodities. Stages of processing are primary and secondary. In primary processing raw material is converted into food commodities, while in secondary processing commodities are converted into edible products. Processing is mainly done to convert the products into edible forms, to extend shelf life, availability, accessibility and also to provide variety into the form of value added products. Processing of products destroys inhibitors, microorganisms, retards physico-chemical and biochemical deterioration, maintains good sensory properties, preserves and enhances the nutritive value. Unit operations involve phase changes and sometimes chemical reactions also, which are undesirable as they cause inferior quality of the product (Gekas 1992). Different processes like separation, assembly, preservation and packaging are broader classification for unit operations in food processing (Saravacos and Kostaropoulos 2002).

INTRODUCTION

Fruits and vegetables are historically important constituents of human diet and the growing awareness of consumers about the beneficial effects of these commodities could result in enhancement of global trade involving fresh and processed fruits and vegetables. Emergence of postharvest handling of fresh fruits and vegetables facilitated global trade of these commodities. The developed countries started realizing the export potential of these commodities by development of adequate value addition in terms of pretreatments, shelf life extension and packaging besides grading and other associated packing house operations. However, the trade concerning fresh fruits and vegetables could never come out completely from problems related to pesticidal residues, spoilage, bulkiness of the commodities involving transportation of inedible portions and excessive packaging costs arising out of bulkiness. The other problems associated with fresh produce include mandatory requirement of specific storage temperatures with refrigeration as the primary means of regulation of metabolic rate.

INTRODUCTION

Packaging is an important aspect in modern life and in fact the word ‘packaging’ developed a literal value indicating presentation of an issue or material in a comprehensive and compact manner. Food packaging has become a revolutionary trend and plays a dominant role in the promotion of marketing of various fresh and processed food products. The reason could be a number of aspects inclusive of protective, legal and aesthetic elements. The industrial revolution in the late 18th century caused major impact on manufacturing process. Without appropriate packaging no food is acceptable and even in the common household food packaging is being practiced in its own way to render food safety and convenience for various culinary operations. Therefore, food packaging needs to be considered as an essential element of food processing and marketing and it is one of the key areas in food technology making rapid strides in research and development.

F- distribution : A probability density function that is used in analysis of variance and is a function of the ratio of two independent random variables each of which has a chi-square distribution and is divided by its number of degrees of freedom.

F₀ value : It is used to express F-value when z =10^ºC/18^ºF and the temperature is 121.1^ºC. It is the number of minutes at a specific temperature (250^ºC) required to destroy or kill a stated number of microorganisms and has specific z-value. It is also called reference value. 

1.1. IMPORTANCE OF FOOD MICROBIOLOGY

Food may be defined as substances that provide nutrients, which when eaten and absorbed by the body, maintain life and growth. Food is basically energy stored in plant and animal foods in chemical form. On consumption, the stored form gets converted to physiological energy. Food is the prime necessity of life. Man has exhibited much thought and foresight in cultivating a variety of grains, fruits, vegetables, nuts and oilseeds and in rearing birds and animals for use as food.

Of the three primary needs of an individual, food, clothing and shelter, ‘food’ occupies the most important place. The biodiversity of foods- cereals, millets, pulses, oilseeds, spices, fruits and vegetables is varied and high in India, where we have varied agro-climatic regions from Kashmir to Kanyakumari. All the fifteen major climates in the world exist in India. India is the second largest producer of food in the world. The impact of green revolution is remarkable in India with many fold increased food production in the last five decades. The full potential of Indian agriculture can not be realized unless India emerges as a major player in the World agriculture.

World population is set to go beyond nine billion by 2050 and demand for food is likely to increase further because of growing affluence and globalization. Food security is achieved when all people have physical and economic access to sufficient, safe and nutritious value added food. India is emerging as a food power in the international trade of foods. The food processing industry in India has been identified as one of thrust areas for the development of the country. It has emerged as a highly perspective sector with immense potential in food processing. The future of Indian food processing industries is bright, provided it improves its quality of products as per international standards.The quality of food processing refers to the adherence of physical, chemical, biological, nutritional and sensory parameters required to achieve the wholesomeness of a food product. Quality control has become an important aspect for food processing industry for both domestic and export markets.

4.1 Introduction

A huge amount of waste in the form of liquid and solid is produced in the fruit and vegetable processing industry which causes pollution problem if not utilized or disposed off properly. Generally solid waste is dumped in local landfills, eaten and scattered by stray animals, which has now become a major cause of environmental pollution. The waste obtained from fruit processing industry is extremely diverse due to the use of wide variety of fruits and vegetables, the broad range of processes and the multiplicity of the product [79]. The solid waste from fruits and vegetables includes peel, stone, rag, seed, core etc is of economic value and can be used for manufacturing of various by-products [21]. The extent of the waste produced from processing industries of some of the important fruits and vegetables, is given in Table 1.

In India, utilization of fruits and vegetables for processing is hardly 1.8% of the total production. There were 5166 processing units till 1^st Jan, 2009 of fruits and vegetables products throughout the country. About 90% of these units are small scale units with annual production limit of 50-250 tonnes. These units have no organized methods of waste disposal. In certain places this waste is taken away by farmers for their disposal as cattle feed or field manure.

7.1 Introduction

Evaporation is an unit operation which converts a liquid into a vapour, leaving behind a concentrated solution or a higher boiling liquid. In other words, the goal of evaporation is to vaporize most of the water from a solution containing a desired product. Heat is the main tool in evaporation, and the process occurs more readily at high temperature and low pressures. Removal of water from foods provides microbiological stability, reduces deteriorative chemical reactions, and reduces transportation and storage costs. Evaporation can be distinguished from some other drying methods in that the final product of evaporation is a concentrated liquid, not a solid. It also differs from distillation, since the vapours produced in the evaporator are not further divided into fractions.

1.1. Introduction

The significance of milk as the most wholesome single food available in nature has never been debated. It is as ancient as mankind itself, as it is the substance created to feed the mammalian infant. All species of mammals, from the lowly rat to the mighty whale, produce milk for this purpose. Several centuries ago, perhaps as early as 6000-8000 BC, ancient man learned to domesticate species of animals for obtaining their milk for consumption. These included cows, buffalos, sheep, goats and camels, all of which are still used in various parts of the world for the production of milk for human use (Fig. 1.1 & 1.2).

Milk, as secreted in the udder of a healthy animal is practically sterile, but during its transit to the processing plant, becomes heavily contaminated with a variety of micro-organisms. These may be responsible for spoilage of milk or for causing diseases in animals and human beings. It thus becomes imperative that adequate heat treatment is given to milk to destroy these micro-organisms, thus increasing the shelf-life of milk as well as making it safe. Varied heat treatments offer the potential of producing different kinds of processed milk to satisfy the needs of the consumer. To cater to the ever-increasing demand of consumers, several varieties of processed milk are available in the market, some of which are discussed below.

5.1. Pasteurised Milk

Pasteurisation was named after the renowned French scientist Louis Pasteur, who discovered that spoilage organisms could be inactivated in wine by applying heat at temperatures below its boiling point. The process was later applied to milk and remains the most important operation in the processing of milk.

It is the process by which every particle of milk is heated to such temperature-time combinations (usually to 63°C for not less than 30 minutes or to 72°C for not less than 15 seconds) and promptly cooled to 4°C or below so as to destroy any harmful bacteria that may be present without affecting flavour and food value. Pasteurisation does not involve the use of any additives. Apart from making milk safe to drink, pasteurisation increases the length of time it can be kept before it spoils. The nutrient losses due to pasteurisation are so small, that they are considered insignificant.
