Today it has been understood that yeasts have great potentials as novel probiotics (Nayak, 2011). They have been found to be safe for human consumption in traditional fermented foods (Jakobsen and Narvhus 1996). Yeasts have a great physiological importance inside the gastrointestinal (GI) tract (Czerucka et al., 2007; Gatesoupe, 2007). Jespersen (2003) has mentioned the role of consuming fermented foods and the health benefits attributed with it.Yeasts are known for prevention of table olive (Arroyo lopez et al., 2012). Bonatsau et al. (2015) have shown multi-functional property of yeast as starters.

1. Introduction

Storage is an important part of any food grain processing chain. Storage of raw and processed food grain has been used by humans since time immemorial as a prerequisite for insuring food security due to off time availability, and for holding seed grain for long periods (Pande and Mishra, 2012). After harvesting grains may be required to be stored for long periods before these are marketed or used as food or seed. The grain storage is mainly carried out for three purposes viz (i) to retain a supply of food (ii) to service a trading system and (iii) to retain seed for planting the following season (Hall, 1980). Storage is, therefore, carried out by the producer, trader, processor, and the exporter and at all these levels the methods adopted affect the quality of food stuffs. The length of time grains can be safely stored will depend on the condition it was harvested and the type of storage facility being utilized. Grain storage and handling is a major concern for food grain growers and processers worldwide (Mohan et al., 2011; Pande and Mishra, 2012). Depending upon the condition and uses food grains may be stored in different storage structures using traditional or modern storage methods. Different storage structures are used by farmers with the traditional names like Gumma, Oliya and Jute bag. Caswell (1973) recorded 50 to 60% of insect damage on food grain after six months of traditional storage. A typical range of storage methods encountered in tropics and subtropics region is given in Table 1.

Food is an important contributor to human well being and is essential for sustaining life. From this point of view food is expected to contains essential nutrients, such as carbohydrates, protein fat, vitamins and other essential minerals which support life. The food production initially started for individual sustenance which slowly developed in to a community requirement necessitating the involvement of man and machinery for various activities concerned with food. The progress from famine in many parts of the world to the level of self-sufficiency and the role of science and agriculture have been absolutely significant in many parts of the world. India is no exception and the green revolution during the post 1960s and the succeeding blue and white revolution ensured the self-sufficiency in India.

Of late food acts as a vehicle for inclusion of hazard in food meant for human consumption. According to Grunert (2005), factors responsible for the alarmingly higher rate of concern by public include significantly higher number of food scares in public domain, critical understanding of production and processing of certain food products sold in the market as well as the diversified food choices of the consumers in different parts of the world. Besides, the increased awareness of the consumers on food related health issues also have its share in the increased concern on food at large.

Presently food is considered as a commodity which crosses international border concurrent with the human movement and hence quality has become a major concern. The traditional food is getting replaced with value added products, particularly ready to cook, ready to eat, partially cooked products, etc. consequent to life style changes. In order to meet the demand of the trade, the conventional processing is getting replaced by community processing or industrial processing with increased number of players in the primary production, processing, transportation and other value chain activities prompting larger product control. In the process, consumers are exposed to a variety of products produced as business ventures in modern food production systems needing efficient quality control and quality assurance to tackle the issues of quality. The increased incidence of hazards in both raw materials and final products consequent to the absence or inappropriate production schedule calls for increased food safety concerns. Besides the shelf-life of the products, addition of chemicals during the production also add to the concern.

Introduction

As the world population continues to grow, the global market for food products is expanding, together with an increased emphasis on food safety. Consumers have become more discerning in the type of foods they buy and how these foods affect their health and well being. Food safety is generally defined as the assurance that the food will not cause any harm to the consumer when it is prepared and/or eaten according to its intended use ( To achieve food safety, a management system has been developed which aims on preventing problems before they occur, rather than trying to detect failures through end product testing. It also places more responsibility for ensuring food safety on food manufacturers, who have to develop control and traceability of their products from ‘farm to plate’. The system requires the identification of specific hazards throughout the entire process of food production, concentrates on the points in the process that are critical to the safety of the product, and highlights measures for their control (Henson and Caswell, 1999).

Tropical tuber crops viz., cassava (Manihot esculenta Crantz), sweet potato (Ipomoea batatas), taro (Colocasia esculenta), yams (Dioscorea sp.), Elephant foot yam (Amorphophallus paeoniifolius), arrowroot (Maranta arundinacea) etc., are the important sources of starch after cereals and are used as staple or supplementary food in many of the tropical and sub tropical countries. Being the crops with adaptability to wide range of soil, climate and environment of the tropics and sub tropics and requiring minimum agronomic input and care for growth, they can be very well fitted into the prevailing cropping systems. They are the most efficient converters of solar energy and have the ability to reserve energy in the form of carbohydrate in the bulky roots and hence tuber crops are also called as calorie density crops. Tuber crops, though branded as poor man’s crops in rural areas have considerable unrealized potential for processing into high end products for food, feed and industrial uses. They are generally consumed as vegetable after boiling it in water and eaten along with some spicy curry or by extracting starch or flour. Besides serving as an insurance crop during times of food scarcity, it can also function as an industrial raw material for a wide spectrum of products

Baking is a traditional activity which has a long history, and according to some recent discovery, it is indicated to be dated back to as early as around 21,000 B.C. It is termed as a complex operation of prolonged heat transfer through radiation, convection, and conduction. Baking is considered to be one of the oldest methods of cooking, most commonly the bread baking but it is not only limited to the bread instead it provides a wide range of products such as cookies, pastry, pizzas, breakfast cereals, etc. Baking includes lots of raw materials such as flour, water, yeast, milk and milk derivatives, shortening, sugars, eggs and some minor ingredients such as malt products, cocoa products, dough improvers, inhibitors of microbiological spoilers, spices, etc. Food items which are rich in sugar and carbohydrates such as chocolates, candies are known as confections, and the art of making these products is termed as confectionary. Confectionery can be broadly classified into two major categories, namely sweet confectionary and baked confectionery. Conventionally cake was defined as the flour based sweet food, whereas bread was defined as the flou-based non-sweet food.

Baked confectionery, also known as flour confectionery includes products such as cakes, pastries, and similar baked goods, especially which are served in dessert. These delicacies hold history not much later to the bread baking. Earlier the baked confectionery especially cakes were only affordable by the rich and were prepared for special occasions such as festivity, celebrations, etc. but now a large number of flour confectioneries are being produced in the world which is delightfully acceptable and are much more in demand by a various group of people.

Wheat Production and Consumption

Wheat, rice, maize, barley, sorghum and the millets are the main crops that provide nutrition to people worldwide. The production of grains in different countries depends on the various factors such as water availability, soil conditions, temperature, cultural and economical are most critical factors. Nutritional needs of the developing countries are more dependent on cereal grains compared to the developed ones. Approximately 60% of the calorie requirements in the developing countries are met from cereals. The International Grains Council (IGC) forecasted for total grains production in 2017-18 to 2.079 billion tonnes. There is a need to have major research to increase their productivity, reduce storage losses, enhance efficiency of processing and to ensure food safety in the entire supply chain. Among them, wheat is one of the most important crop species and is a staple food for about 35% of the world population. Wheat is unique among the grains because of its protein type, which when mixed with the water by mechanical forces yields into viscoelastic dough due to the formation of gluten. This unique property of dough is capable of retaining the gases which are produced by yeast or baking powder resulting in the production of an array of leavened products such as bread, cookie and cake.

Wheat is also an important source of dietary proteins for humans but like other cereals, it is deficient in the essential amino acid lysine. Wheat crop is adaptable to the wide range of growth conditions compared to other major cereals and hence it is cultivated widely throughout the world. Wheat cereal is the major dominating staple in the North Africa, Central and West Asia, providing the 50% of the calorie requirement in the region. The world wheat production is 740 million tonnes, with China ranking first by producing 125 million tonnes of wheat annually. Other major wheat producing countries are India, USA, Russia Australia, France and Canada. The global per capita consumption of wheat is about 66 kg, which varies widely in different regions. In Algeria, Egypt, Israel and other Middle East as well as Eastern Europe the consumption of wheat flour is high (150 kg/year). The food uses of wheat in developing countries are more than 80%, while in developed countries it is less than 50%. The consumption of the wheat in developing countries is significantly increasing due to globalization and growing economies. After rice, wheat is a major cereal crop in India and contributes to more than 50% of the total calories. It is grown in the cooler regions of India during the period of November to April. In grain production, rice ranks first with the production of about 105 million tonnes per year. In India, total grain production is 136 million tonnes for the year 2016-17 as per the International Grains Council. India ranks second in the production of wheat in the world and produce about 95 million tonnes annually. The bread wheat (astevum) contributes to approximately 94% while durum wheat is 4% and dicoccum wheat accounts to 2%.

Oils and fats are the major class of compounds in lipids. Oils and fats are essential nutrients in both human and animal diets and produced from plant, animal, marine and microbial sources. Dietary oils and fats are concentrated sources of metabolizable energy (9 kCal/gram) compared to protein or carbohydrates (4 kCal/g). According to the recommendations of Food and Agriculture Organization (FAO) of the United Nations, the maximum total fat intake for adults is 30 to 35% E (total energy calories). The minimum fat intake recommended is 15% E for most individuals and 20% E for women of reproductive age and for malnourished populations (FAO, 2010).The current dietary guidelines for optimal health and prevention of diet-related chronic diseases like diabetes, coronary heart disease (CHD), cancer and obesity emphasize the importance of both the quantity and quality of total fat in the diet. In addition to the caloric and nutritional value, oils and fats exhibit many functional properties in the diet. Oils and fats enhance the value of foods by releasing the flavours of other food components, provide texture, increase palatability of food, and impart the feeling of satiety after eating. Oils and fats provide essential fatty acids (omega 3 and 6) which are the building blocks for several metabolic pathways for the healthy life. Oils and fats are excellent carriers of fat-soluble vitamins A, D, E and K, and the absorption of these vitamins is impaired at very low-fat intakes. Due to this reason, sseveral countries have started using edible oils and fats as a suitable vehicle for the fortification of vitamin A and D as edible oils are consumed by almost everyone (Diosady and Krishnaswamy, 2018). Oils and fats are structural bodily components, and are involved in vital physiological processes, including growth, development, inflammation, and brain function. Lipoproteins are important cellular constituents, occurring both in the cell membrane and mitochondria, and also serving as the means of transporting lipids in the blood. Oils and fats are responsible for making biological membranes such as phospholipids and cholesterol, vital for making the cell membranes. Most of the edible oils contain several minor constituents which are known as potent nutraceutical constituents with several health benefits. In addition to edible purpose, oils and fats are being used in many industrial applications such as soaps, detergents, cosmetics, lubricants, specialty chemicals, biofuels, etc. Hence oils and fats are indispensable source for food (edible oils and nutraceuticals), fuel (biodiesel, lubricants etc.) and fabulous chemicals (oleochemicals).

Fruits and vegetables (F&V) are good sources of phytochemicals like carotenoids, phenolics, dietary fibers, minerals and vitamins and are considered as important components of a healthy diet. These bioactive compounds in fresh F&V have been linked to delay in onset of many diseases including cardiovascular, chronic and other non-communicable diseases. WHO reported an approximate 3.9 million deaths all over the world in 2017 due to insufficient consumption of F&V (WHO, 2019). Hence, health advisors and nutritionists recommend inclusion of fresh fruits and vegetables to complement the daily diet, and WHO recommends the consumption of a minimum of 400g F&V daily in five portions. However, beneficial raw F&V may contain pathogenic microorganisms, such as Salmonella, E. coli, and Listeria that can pose threat to consumer safety. Since fruits and some of the vegetables are eaten raw, there are chances that pathogenic microorganisms may also enter food chain. Nearly a half of food borne illnesses in United States are caused by microbes on fresh produce (CDC, 2019). The F&V are handled by producers, dealers, wholesalers, retailers and several intermediaries, and therefore, are at greater risk of possible contamination till it reaches the consumer.

The ever increasing demand for F&V has led to overexploitation of pesticides usage in the farms, leading to harmful pesticide residues in air, soil, water and on the F&V surfaces. Thus, it is imperative to maintain the quality and safety of F&V all through the supply chain. In this chapter, we discuss various pre and postharvest factors affecting the quality and safety of F&V, storage techniques to extend shelf life and reduce the safety threat as well as methods available for microbial and pesticide decontamination of fresh F&V.

The conventional thermal processing technologies are dependent on high temperature to control the growth of pathogenic and spoilage causing microorganisms. However, the exposure to high temperature for prolonged time results in several biological, chemical and physical modifications leading to their sensory, nutritional and textural changes. Currently, consumers are more interested in minimally processed food products with improved safety and shelf life. In order to fulfill the market demand, innovative non-thermal food processing techniques to inactivate the microorganisms have been developed. These techniques retain freshness, nutritional value and sensory characteristics of food items without any significant thermal degradation.

Non-thermal technologies are used in interdisciplinary sciences, and in many other applied areas. The three main pillars related to the use of novel food technologies are food safety, quality and environmental impacts. Besides the food safety and quality dimensions, these non-thermal processing technologies have the possibility to shorten treatment time, lower energy consumption, and lower carbon footprint. Depending on the source of energy transfer, non-thermal technologies have different types of action. It includes inactivation of microorganisms in radical formation (plasma, ultrasound, ozonation, UV light, etc.); mechanical action through hydrodynamic effects, shock waves (ultrasound and plasma), electric and magnetic fields; or extremely high pressures that are causing disruption of the cell organelle.

The novel non-thermal technologies destroy the pathogens at room temperature as well as utilize less energy compared to conventional ones and have the potential of developing new food products having distinctive functionality. For optimizing the product quality, time for processing and also to inactivate the enzymes and bacteria, each of these techniques can be used either alone or in combination. The adverse effect of some technologies on the sensory, texture, and nutritional values of food could be overcome by using hurdle technology. Combination strategies are more efficient for improving the food quality and have the potential to ensure the microbial safety of foods. An overview of the effect of novel process technologies on the quality and safety of food is elaborated in this chapter.

The dairy processing industry in India deals mainly with the fluid milk and/or short shelf life products, despite India being the largest producer of milk in the world, with an output bordering the 110 million ton mark. This feature offers immense potential in the area of R&D in dairy processing in terms of value addition. The potential gains are many, including higher returns for producers and advantages in terms of health, therapeutic, nutritional and/or gastronomy for the consumers. However, the Indian Dairy Industry can amass possible benefits by being a global contender in trade only when its products are at par with those available in the rest of the world in terms of price and quality. It is evident from the post-WTO scenario that for sustainability, Indian dairy industry will need to maintain wholehearted commitment to quality management right from the farm to the consumer, shedding its inhibitions and resistance to changes.

9.1. WTO Agreements and Food Industry

The General Agreement on Tariffs and Trade (GATT) was formed in 1947 and lasted until 1994, when it was replaced by the World Trade Organization (WTO) in 1995. The WTO is the only global international organization dealing with the rules of trade between nations. It provides a forum for negotiating agreements aimed at reducing obstacles to international trade and ensuring fair deal for all, thus contributing to economic growth and development. Currently, there are 16 agreements to which all WTO members are parties and two agreements to which only some WTO members are parties. WTO currently has 153 members, of which 117 are developing countries or separate customs territories. The Head Quarters of WTO is at Geneva (Switzerland) and the official languages are English, French and Spanish.

Packaging helps to maintain the benefits of food processing and enables safe transportation of foods from their point of origin to point of consumption without compromising the wholesomeness of processed food in terms of its physico chemical and microbiological quality. However, packaging technology must balance protection effects with environmental issues, material and energy costs and should comply regulations on municipal solid waste disposal and release of pollutants. These regulations are different in jurisdictions around the world.

Safety implications of food packaging raise concern in recent times due to advances in technology leading to variety of packaging materials and additives. Also there is an alarming situation of damages to environment and natural resources of the planet, due to indiscriminate use and disposal of packaging materials.

However, food packaging as a means to protect and preserve food integrity, to enhance its shelf life and improve consumer appeal cannot be overlooked.The applications of food packaging and its primary role to protect and preserve food has remained the central focus of packaging innovations.Packaging materials are available in variety of forms and are made up of variety of ingredients.While paper. While paper, plastic, petroleum based materials have been in use for many years, the recent approach is towards environment friendly options from agricultural produce such as plant fibres sugars and starches. Advances in packaging has led to development of newer materials and combinations with specific economic and functional benefits.Food packaging ,in general , provides the ability to withstand thermal processing and acts as a barrier against light, moisture,oxygen and other sources of contamination.

For a researcher, laboratory is another home where he/she spends much time every day. As we take care of cleanliness, safety, and design of our home, we must take care on these aspects of laboratory too. It is the responsibility of the laboratory personnel to ensure cleanliness/safety of the laboratory. Since every laboratory chemical and equipment have the potential to cause harms if not used with appropriate precautions. Hence, as a laboratory user, it is our responsibility to follow the basic safety/biosafety rules and regulations set up by the Principal Investigator of the laboratory, Institutional Biosafety Committee, as well as by other regulatory authorities, if any. We must be aware of the general/personal protective measures, cleanliness and laboratory waste disposal prior to joining a research laboratory. In this chapter we will briefly discuss about personal safety, chemical safety, cleanliness, waste disposal, etc.

A. Personal Safety

1. Personal Protective Equipment (PPE)

Personal protective equipment (PPE) is special arrangement to protect the worker from specific hazards because of using a hazardous substance. PPE does not reduce or eliminate the hazard, but protects the wearer from exposure to hazardous material. PPE should not be reused or brought outside the laboratory as these might increase the risk of spread hazardous material or contamination. Used PPE must be kept inside the laboratory in a designated waste storage area adjacent to the work area.

Josephson (1977) studied the effects of food irradiation and sterilization. In radiation sterilization of food (radappertization) the food is exposed in sealed containers to ionizing radiation at absorbed doses which are high enough (25-70 kGy) to kill all organisms of food spoilage and public health significance. Radappertization is analogous to thermal canning for enhancing the shelf stability. In dry products the radappertization process requires the food to be heated to an internal temperature of 70-80°C (bacon to 53°C) to inactivate autolytic enzymes which catalyze spoilage during storage without refrigeration. In order to reduce off-flavors and odors, undesirable color changes, and textural and nutritional losses from exposure to the high doses of irradiation the foods are vacuum sealed and irradiated frozen. Radappertozed foods have the characteristic of fresh foods prepared for eating. Irradiation can be a good substitute for some chemical food additives such as ethylene oxide and nitrites which are toxic, carcinogenic, mutagenic or teratogenic either wholly or in part. Till now, there is no evidence of any adverse effects of radappertization on the foods. Extensive research has taken place towards the space food. During the planning of Apollo missions, Space Food NASA Technical Reports Server (Space Food NASA Technical Reports Server, NTRS ,1994 ) conducted trials including freeze drying.

Sales and distribution determine whether a technically excellent ice cream product successfully reaches consumers in the required condition and at the right time. This chapter examines the architecture of ice cream distribution in India, including factory dispatch, CFAs, distributors, retailers, parlours, modern trade, quick commerce, and online channels. It discusses route-to-market design, presales, delivery systems, distribution management, retail execution, outlet classification, freezer deployment, and channel economics. Product flow and information flow are considered together because sales data, stock information, complaints, freezer conditions, and market feedback influence production and planning decisions. The chapter provides practical insights into distribution KPIs, channel management, cold-chain discipline, and strategies for sustainable market growth.

Whilst food has long been used to improve health, our knowledge of the relationship between food components and health is now being used to improve food. Although most foods can be considered “functional”, in the context of this review, the term is reserved for foods and food components that have been demonstrated to provide specific health benefits beyond basic nutrition. Widespread interest in select foods that might promote health has resulted in the use of the term “functional foods”. Seaweeds are known for their richness in polysaccharides, minerals and certain vitamins [1], but they also contain bioactive substances like polysaccharides, proteins, lipids and polyphenols, with antibacterial, antiviral and antifungal, as well as many such other properties [2]. This gives seaweed great potential as a supplement in functional food or for the extraction of compounds. Physiologically active substances in marine algae are classified into two types based on the difference in the mechanisms viz. (i) non-absorbed high-molecular materials like dietary fibres, and (ii) low molecular materials, which are absorbed and which affect the maintenance of human homeostasis directly. Seaweeds are among the first marine organisms chemically analyzed, with more than 3,600 articles published describing 3,300 secondary metabolites from marine plants and algae, and they still remain an almost endless source of new bioactive compounds [3].

Dairy industry has long dealt with issues of food pathogens and inadvertent adulteration; it is time to review the plant systems with a new perspective. Each plant has its own handling protocols, physical lay-out and employee policies. Milk and other materials entering the facilities, till the distribution of the finished product needs special attention.
 
I. INCOMING MATERIALS

In general, start by considering the milk, food ingredients, packaging, chemicals and other materials that come into plant facility and warehouses, and ensure that these product streams are secure, and that materials are stored in asecure place.

Quality is the ultimate criterion of the desirability of any food product to the consumer. Overall quality depends on quantity, nutritional and other hidden attributes along with sensory quality. Sensory quality is of great importance to both processors and consumers, since it attracts consumers; it satisfies consumers’ aesthetics and gustatory sense. Sensory quality is the combination of sensory senses of perception responsible for choosing and eating a food.

According to Institute of Food Technologists and the American Society for Testing and Materials, sensory evaluation is a scientific method used to evoke measure, analyze, and explain those responses to products as perceived through different senses like sense of sight, smell, touch, taste, and hearing (Stone and Sidel, 2004). Sensory evaluation gives a general rule for the preparation and serving of samples under controlled conditions so that unfair decisions are minimized. People for sensory evaluation are often placed in individual test booths so that the judgments they give are true and do not reflect the opinions of those around them.

Samples with random numbers are given to the evaluators so that they do not form judgments based upon labels, but rather on their sensory experiences. Products may be given in different orders to each evaluator to help measure and to ensure internal validity by controlling the potential confounds created by sequence and order effects. To control unwanted variation and to improve test precision, standard procedures may be established for sample temperature, volume, and spacing in time, as needed.

Sensory evaluation or testing is a quantitative science in which numerical data are collected to establish lawful and specific relationships between product characteristics and human perception. Sensory methods draw heavily from the techniques of behavioural research in observing and quantifying human responses. For example, we can assess the proportion of times people are able to discriminate small product changes or the proportion of a group that expresses liking for one product over another. Another example is having people generate numerical responses reflecting their perception of products taste and smell.

Sensitivity-Threshold tests Sensitivity tests are conducted to assess the ability of individuals to detect different tastes, odors and feel the presence of specific factors in.

INTRODUCTION

A mixture is a combination of two or more elements or compounds in any proportion so that the components do not lose their identity. Most materials in our world are mixtures and very few materials are pure substances. Foods are complex mixtures of compounds and the extraction or separation of food components is fundamental for the preparation of ingredients to be used in other processes. Separations usually aim to remove specific components in order to increase the added value of the products, which may be the extracted component, the residue or both. Purposes include cleaning, sorting and grading operations, extraction and purification of fractions such as sugar solutions or vegetable oils, recovery of valuable components such as enzymes or flavour compounds, or removal of undesirable components such as microorganisms, agricultural residues or radionuclides. For example, cooking oils from oilseeds or gelatin from connective tissue; or for retrieval of high value compounds, such as enzymes (e.g. papain from papaya for meat tenderisation or rennet from calf stomachs for cheese making). Other types of separation methods are used to sort foods by separating them into classes based on size, colour or shape and to clean them by separating contaminating materials.

The various unit operations of food process engineering applied to solve the problem of changing the compositions of solutions, mixture and solids. Often these operations must be conducted on large scale to meet the demands of a large manufacturing plant. In food processes engineering these operations are often referred to as separation / concentration / extraction / purification process. Usually these operations are directed towards separating substances into its component parts or concentrating a particular substance from another.

Shelf life is a critical measure of ice cream quality and depends on formulation, processing, hardening, packaging, storage, and distribution conditions. This chapter explains the concept of shelf life and follows the movement of ice cream through the storage and distribution chain. It identifies temperature fluctuation and thermal abuse as major causes of quality deterioration, particularly through ice recrystallization and structural damage. The chapter examines hardening, formulation stability, cold-chain controls, shelf-life KPIs, and formal shelf-life studies. Common defects and their causes are also discussed. By understanding how temperature and handling influence product stability over time, manufacturers can establish better controls and protect texture, flavour, appearance, packaging integrity, and consumer acceptance.

1810 ó Preservation of food by canning was patented by Appert in France. ó Peter Durand was issued a British patent to preserve food in ìglass, pottery, tin or other metals or fit materials.î The patent was later acquired by Hall, Gamble, and Donkin, possibly from Appert.

Abstract

This review assesses the nutritional attributes of Amaranth grains and its utilization as food and as formulated foods. Amaranth is a pseudo-cereal and one of the most ancient cultural food plants with excellent source of superior quality protein (rich source of lysine) which is deficient in wheat and other cereals. Amino acid composition of amaranth protein is close to ideal and, as a result, has high food value. Amaranth grain is loaded with phytochemicals including phenolic acids, tannins, anthocyanins, and phytosterols. Amaranth is potentially a good dietary source of the pro-vitamin A carotenoid (f-carotene), antioxidants (nutraceuticals) and canthaxanthin (which has also been reported to be an antitumor agent) and lutein, which is reported to slow down the development of age-related eye diseases. There are also some anti-nutritional factors (Phytic acid, Tannin and Trypsin inhibitor etc.) that may be reduced by certain processing treatments. Several epidemiological studies show Amaranth grains are helpful in reducing several kinds of chronic diseases like cancers, cardiovascular diseases, type II diabetes and various gastrointestinal disorders. Grain amaranth has been tested and recognised by many authorities as a gluten-free foodstuff appropriate for incorporation into the diet for celiac disease patients. Amaranth grain or young leaves could completely or partially substitute common ingredients, so the crop could be potentially exploited as an ingredient in foodformulation in form of flour, flakes, sprouts, grain undergoing fermentation, popping, malting, extrusion cooking, nixtimisation, and special compounds isolation. The interest in this crop is developing due to its several advantageous properties. The nutritionists find that the grain has higher nutritional value than conventional cereals.

Our traditional knowledge of medicine has been one of the strongest areas of research because of our rich heritage in herbal plants & great biodiversity in our fauna & flora. Consumption of plant foods and the structurally diverse natural products provided by them have long been associated with health-protective and therapeutic effects. Natural products in plant foods have been shown to have pleiotropic therapeutic and chemopreventive properties. These bioactive products are known to potentiate the efficacy of other drugs and have synergistic effects too. Most of the prescription drugs discovered so far is from plant sources and 75% drugs had been claimed in folklore claims and traditional medicinal system (Reynold, 1991; Benowitz, 1996). The traditional Indian medicinal system utilizes multicomponent formulations of plant extracts which may either act synergistically or avoid many side effects and might have added up trace element through combination of different plant extracts which could have additive effects. However the effort to utilize traditional knowledge in the light of modern scientific findings is lacking in India. Accumulating evidences as well as in-vitro studies implicates inverse relationship between regular consumption of fruits vegetable and the risk of specific cancer. Diet derived nutritional compound mediated interventions in the process of tumorigenesis may be promising chemopreventive strategy with minimal toxicities to the physiological system.

Recent advances in food technology have made our lives virtually easier and efficient. Changing lifestyle has led to the emergence of packaged food that provides convenience to the consumers. The authentic packaging of food implements consumers with the role of communication, containment, convenience, and protection. Any typical food package provides us with the information about the product and its nutritional fact, thus an efficient way of marketing/ branding. It protects the food product from the external environment and adulteration, thus keeps it safe. It allows the consumers to relish the food as per their convenience (reheating and direct consumption) and holds the product of any size, shape and restrains during handling and transportation (Robertson, 2006).

Food packages can be altered or modified according to one’s requirement with features like single-serving dishes and portability. However, traditional packaging is lacking adequacy to meet unending consumer demands and product intricacies. Therefore, a contemporary concept of packaging with higher proficiency is needed to meet various consumer requirements. For instance, a packaging that can - enhance product’s shelf-life with lesser or no preservatives, that maintains freshness, that meets permissible regulatory requisites and enables tracking throughout the product life-cycle. Emerging technologies like smart packaging have the expertise to invigilate a product and its milieu and pursue any modifications into these. Moreover, smart packaging helps in gaining global market recognition, and meets international food safety standards. In recent years, there has been rapid development in food packaging that includes active packaging, intelligent packaging, or smart packaging. These are the technologies that deal with the packaging of food, beverages, cosmetics, and pharmaceutical products. Moreover, these terminologies are apparently identical but, each has a different function to deal with and is as follows:

Percent Solutions

There are three types of percent solutions. All are parts of solute per 100 total parts of solution. Based on the following definitions you may calculate the concentration of a solution or calculate how to make up a specific concentration

    1.    % W/W - Percent of weight of solute in the total weight of the solution. Percent here is the number of grams of solute in 100 grams of solution. 
        Example: 
        A 100% (W/W) NaCl solution is made by weighing 100 g NaCl and dissolving in 100 g of solution

    2.    % W/V - Percent of weight of solution in the total volume of solution. Percent here is the number of grams of solute in 100 ml of solution. This is probably the least significant way of naming a solution, but the most common way of doing it. In fact, any percent solution not stipulated as W/W, W/V, or V/V is assumed to be % W/V. 
        Example : A 4% (W/V) NaCl solution is 4 g of NaCl in 100 ml of solution.

    3.    % V/V - Percent of volume of solute in the total volume of solution %V/V. Percent here is the number of milliliters of solute in 100 ml of solution. 
        Example: A 10% (V/V) ethanol solution is 10 ml of ethanol in 100 ml of solution; unless otherwise stated, water is the solvent.

Infection

Invasion of the body of a man or an animal or a plant by disease producing organism. Infectious disease is a condition brought about by an infection of the body by an organisms which is responsible for the disease. Organism that are capable of bringing about infectious diseases are called pathogens while those organism without this capacity are said to be non pathogenic.

Commensals

Organisms on skin and mucous membrane which multiply without causing damage to the tissue.

Subclinical infection / latent infection

When organism enters the tissue and lead to immunity without the appearance of any definite clinical symptoms.

The sources of contamination of milk on the farm can broadly be categorized as

    a)    Interior of the Udder
    b)    Exterior of the Udder.
The interior reflects the health of the animal, while the exterior depends on the farm condition, equipment, persons, water etc.

a) Interior of the Udder
The animal by itself is one of the most significant contributors of microorganism in milk. The bacteria in the udder usually enter from the teat opening and get distributed internally by their own growth and physical movement. In the normal healthy udder, the types encountered in milk are most predominantly Micrococci, followed by Streptococci, Corynebacterium and others. Most of the bacteria are excreted in fore milk.

Dairy farming and milk processing are critical components of the agricultural sector, providing nutrition and livelihoods to millions, particularly in rural areas. Financing options are necessary to cover the costs of livestock, infrastructure, and equipment for milk production, storage, and distribution. Various sources of finance are available to entrepreneurs and farmers, including bank loans, government subsidies, and microfinance (Gashayie and Singh, 2015). Commercial banks offer long-term loans under agricultural finance schemes, providing funding for both purchasing assets and managing daily operations. Government programs often provide subsidies and grants to promote dairy farming, such as the Dairy Entrepreneurship Development Scheme (DEDS) in India, which supports small scale farmers (Naik and Patel, 2022). Microfinance institutions (MFIs) also play a vital role in offering credit to small and marginal farmers with fewer formalities. Additionally, cooperative societies and producer companies help pool resources, offering financial and technical support to dairy farmers (Kumar et al., 2021). For larger processing units, venture capital and private equity investments can provide growth capital. Non-governmental organizations (NGOs) and international funds also contribute to the dairy sector by offering low-interest loans and promoting sustainability. Understanding these diverse sources of finance is key for dairy entrepreneurs to plan effectively, ensuring long-term profitability and growth.

When natural constituents of whole milk are altered by addition, removal, exchange and / or treatment, the resultant milk is designated as special milk. Recent years have witnessed a large increase in market penetration of special milks into the total fluid milk market. In many countries, now a large portion of fluid milk is consumed in the form of special milks. Manufacturers of special milks offer numerous advantages that are broadly related to dietary, cost and scarcity aspects. Special milks provide an avenue to diversify the milk with variety of flavours and other characteristics.

Milk is considered as nature’s almost perfect food. However, milk in its natural form is not considered suitable for many more healthy people who do not like the taste of milk as such. All these problems can be overcome by manufacturing special milks such as dietetic milks, low fat milks, flavoured milks, etc.

Butterfat is the most expensive constituent of milk. Therefore, the cost of buffalo whole milk is very high and many people particularly the weaker section of our society cannot afford to buy it. Consequently, manufacture of low priced toned milk was introduced in many markets. This also enabled the dairy plants to meet the ever increasing demand of milk, particularly during lean season. Replacement of butterfat by vegetable fat could also help in reducing the cost of milk

Due to seasonal fluctuation in milk production, there is acute shortage of milk during the lean period in our country. In certain parts of the world fresh milk is not produced at all. Manufacture of reconstituted and recombined milk from anhydrous milk solids can overcome such whole milk shortage. These anhydrous milk solids could either be prepared from the domestic seasonal surplus or marketed from those countries that have surplus milk production. The machinery and manpower of a market milk plant can be fully utilized all the year round by such diversifications.

Introduction

While flavored milks dominate in terms of appeal to younger demographics, fortified milks, particularly those enriched with vitamin D and calcium, cater to aging populations and health-conscious individuals. The economics of special milks are appealing for producers, with higher price premiums compared to regular milk. Niche areas, such as proteinenriched milk for athletes, lactose free milks for lactose intolerant persons, and low-sugar variants for diabetics, are gaining traction, reflecting evolving consumer preferences for tailored nutrition. This sector’s growth underscores a shift toward personalization in the dairy market, supported by innovations in processing and packaging to retain nutritional quality and extend shelf life.
Flavored Milks
Milk drinks are products ready for consumption, made from milk with differing fat contents and additions such as sugar, cocoa, fruit concentrates, coffee, flavors and/or other food ingredients, which are homogeneously mixed and contribute to flavor and taste. Flavored milks of various types are manufactured on the basis of whole milk, fat-reduced milk or skim milk (<0.5% fat). They are marketed in the form of pasteurized, UHT or sterilized products. These beverages promote milk consumption by offering a flavorful alternative to plain milk, especially for those who are reluctant to drink regular milk. Studies showed that providing flavored milk in schools significantly boosts milk intake, thereby enhancing the consumption of essential nutrients like calcium, protein, and vitamins among children.

Tuberculosis

Tuberculosis has been recognized as one of the most important infectious diseases in the world because of its high global impact and its chronic debilitating character, particularly in the poor section of society. Milk-borne tuberculosis is directly or indirectly related to the consumption of raw milk from infected dairy herds.

8.1 Introduction

Spices are appetizers and hence, esse ntially used in the culinary preparations. They also possess antioxidant, antimicrobial and antibiotic properties. Further, they possess medicinal properties and hence, play an important role in human health.

According to International Organization for Standards (ISO), there is no clear cut division between ‘Spices’ & ‘Condiments’ and as such they have been clubbed together. The term ‘Spices’ & ‘condiments’ applies to “such natural plants or vegetable products or mixtures there of, in whole or ground form, which are used for imparting flavour, aroma and piquancy and seasoning of foods”. Spices are divided into different groups based on their plant components such as floral, fruits, berries, seeds, rhizomes, roots, leaves, kernel, aril, bark, bulbs etc.

About 70 spices are grown in different parts of the world and a major portion of these are grown in India. Hence, India is called “The home of Spices”. It is well known that spices played a significant role in ancient times, in the development of civilization – the life of the people and trade among the nations of East and West. Spices like ginger, pepper and turmeric have an intense and immediate impact on sensory perceptions and exhibit strong physiological effects as food and medicinal constituents. Some spices and herbs like cardamom, saffron and vanilla, which have less intense but more delicate sensory effects, are well known for their contribution to fragrance and usage as food flavouring agents. The history of spices and their use in food and medicine in ancient India have been reviewed earlier [1-3].

Introduction

Spices and aromatic herbs have been used since antiquity as preservatives, colorants, and flavour enhancers. Spices, which have long been the basis of traditional medicine in many countries, have also been the subject of study, particularly by the chemical, pharmaceutical, and food industries, because of their potential use for improving health. Both in-vitro and in-vivo studies have demonstrated how these substances act as antioxidants, digestive stimulants, and hypolipidemics and show antibacterial, anti-inflammatory, antiviral, and anti-carcenogenic activities. These beneficial physiological effects may also have possible preventative applications in a variety of pathologies. The chapter presents an overview of the potential of spices and aromatic herbs as functional foods ingredients.

Introduction

Spray drying process has been used for decades to encapsulate food ingredients such as flavors, lipids, and carotenoids. During this drying process, the evaporation of solvent, that is most often water, is rapid and the entrapment of the interest compound occurs quasi-instantaneously. This required property imposes a strict screening of the encapsulating materials to be used in addition to an optimization of the operating conditions. Likewise, if the encapsulated compound is of hydrophobic nature, the stability of the feed emulsion before drying should also be considered.

Abstract

The aim of this work was to reduce the natural fermentation period of ‘idli’ from the conventional 14 hr to10 hr by adding underutilized okara for the preparation of ‘idli’. Black gram was partially substituted with soy residue okara in the ratio of (1:1). After 14 hr of natural fermentation, the pH and total acidity of control ‘idli’ batter was 4.55 and 0.68% and that of okara fortified ‘idli’ batter was 4.57 and 0.56%, respectively. The amount of CO₂ released by the control and okara fortified batter was 12.5% and 22.5% respectively. The viable count of yeast and mold, lactics and mesophilic bacteria in control and okara batter increased with time reaching 8.4 and 9.6, 8.2 and 7.5, and 8.6 and 9.2 log10 cfu/g, respectively at the end of 10 hr of natural fermentation. Okara fortified ‘idli’ was soft and spongy compared to control ‘idli’.

8.1 Introduction
The chemical composition of milk intended for market or milk product manufacturing must be standardised in numerous dairy processes. Standardising milk may necessitate the regulation of a single component (typically fat) while permitting the other components to shift or regulate two or more components concurrently. Definition: The term “standardisation” of milk denotes the process of adjusting the fat and solids-not-fat percentages of milk to the desired value in order to comply with the legal or other requirements.
Objectives of standardization are
1. To ensure that specific milk and dairy products meet legal requirements.
2. To offer a consistent product to the consumer.
3. To guarantee economic efficiency in production.
The volume of milk available for sale is increased by the addition of skim milk, and the separation of cream enables the production of other value-added dairy products, such as butter, table cream, or other high-fat products.

The stiffness of starch gels from different starches at 5% concentration was shown in decreasing order of stiffness in the following table. Of the cereal starches corn starch gel was firmest followed by wheat and rice starch gels. Among the roots and tubers starches, potato yielded a ropy paste, arrowroot a soft paste while cassava starch gave viscous fluid.

Starters are selected strains of micro-organisms deliberately added to milk during conversion into cheese, dahi, yoghurt and other fermented dairy products to bring about specific changes in the appearance, body, texture and flavour characteristics of the desired final products.

Functions of Starters

The primary function of almost all starter culture is to develop acid in the product. The secondary effects of acid production include coagulation, expulsion of moisture, texture formation and initiation of flavour production. In addition to these, the starters also help in imparting pleasant acid taste, conferring protection against potential pathogens and providing a longer shelf life to the product. These bacteria convert 1% of lactose in milk approximately to lactic acid with very little by-products such as acetic acid, ethanol, CO2 and normally with no substances causing taints and hence leading to a clean and wholesome milk souring.

Starter cultures were unknown until 1878, when Lister isolated pure cultures of the lactic acid bacteria responsible for milk acidification. In the 1980s, improvements to standardization and ripening of butter were made by introducing pure starter cultures. During the period 1910-20, Orla-Jensen, von Freudenreich, Sherman, Hammer and other dairy microbiologists prepared pure cultures for fermented milks. Commercial production and use of starter cultures grew rapidly and was widespread at the beginning of the 20^th century.

Dairy starters are the ‘heart’ of fermented milk products, the most crucial component in the manufacture of high-quality fermented milks. The cultures are harmless food-grade microorganisms, active bacteria intentionally grown in milk or whey or other formulated media which impart desirable and predictable flavour and texture to fermented dairy products.

The dairy microorganisms employed in milk fermentation are single-strain or multiple-strain cultures of lactic acid bacteria, producing different types of fermented milk products. Usually, one or two strains dominate the milk environment. Individual strains can be selected in advance for their resistance to both bacteriophages and antibiotics. Mixed starter cultures are used to ensure that fermentation will continue after a bacteriophage attack. Bacteriophages are highly strain-specific, and if the dominant strain in a mixed-strain starter culture succumbs to an attack, the phage-resistant mutant or the next dominant culture maintains a satisfactory rate of lactic acid production.

Abstract

Agro-food industries generate a large amount of by-products and wastes. These byproducts and wastes have a negative impact in terms of the environmental concern due to the increase of pollutant disposal, and industrial sustainability because of high costs related to their management. These byproducts and wastes are rich in minerals, sugars and proteins. The composition and characteristics of wastes from different food processing industries vary and rely upon the production technique and the nature of the product. India is the second largest producer of rice/paddy in the world and the utilization of rice bran is gaining importance. However, a small fraction of these have been utilized. In case of fruits and vegetables, industrial processing of potato generates between 70 and 140 thousand tons of peels worldwide annually. Moreover, 37% of world’s total annual production of banana is shared by India. Hence, to minimize the disposal fees and trash collection new policies and methods have been developed for handling and treatment of wastes and byproducts. This chapter envisages the status of different agro-food industrial byproducts and wastes for the development of different food and non-food products.

Introduction
Sterilization of culture media, containers, and instruments is crucial in bacteriological work to ensure the isolation and maintenance of pure cultures. Sterilization and sanitization are essential processes in a microbiology lab to prevent contamination and ensure accurate results. Sterilization refers to the complete elimination of all microorganisms, including bacteria, fungi, viruses, and spores, using methods like autoclaving, dry heat, filtration, and chemical agents. Sanitization, on the other hand, reduces microbial load to a safe level through cleaning and disinfection using alcohols, detergents, and UV light. These practices maintain aseptic conditions, protect lab personnel, and preserve sample integrity. Proper sterilization and sanitization are fundamental to microbiological research, clinical diagnostics, and industrial applications, ensuring reliable and reproducible experimental outcomes.
Preparations for Sterilization Before sterilization, cleaned and dried test tubes and flasks should be carefully plugged with clean, non-absorbent cotton. Pipettes should also be plugged at
the mouth end, and the plugs should remain in place during use to minimize oral contamination. Cotton plugs provide sufficient ventilation for bacterial growth while preventing external contamination.

Sterilization is defined as the process by which an article, surface or medium is freed of all living microorganisms either in the vegetative or spore state.

Disinfection means the destruction or removal of all pathogenic organisms, or organisms capable of giving rise to infection. Chemical disinfectants which can be safely applied to skin or mucous membrane and are used to prevent infection by inhibiting the growth of bacteria are called antiseptics.

Five main methods are used for sterilization. 1. Red heat (flaming) 2. Dry heat (hot air) 3. Moist heat 4. Filtration 5. Radiation.

The killing effect of dry heat is due to protein denaturation, oxidative damage and toxic effect of elevated levels of electrolytes. The lethal effect of moist heat is due to the denaturation and coagulation of protein. In the case of spore, steam condenses on it, increasing its water content with ultimate hydrolysis and breakdown of the bacterial protein.

Sterilization is a thermal process aimed at destroying all microorganisms and microbial spores in milk, ensuring the product is microbiologically safe and shelf-stable at room temperature for extended periods. It is primarily used in the production of sterilized milk and evaporated milk, with typical conditions involving heating at 116°C for 15 minutes. This process kills all microorganisms and also inactivates all milk enzymes, including plasmin, which might otherwise contribute to spoilage during storage. However, enzymes produced by psychrotrophic bacteria should not be present in raw milk, as they are highly heat-stable and may remain active even after sterilization. Sterilized milk can be stored at room temperature for longer period. Sterilization kills all microorganisms and inactivates all microbial spores that may germinate under the storage conditions of the product in the market.
The Food Safety and Standards Authority of India (FSSAI) define “sterilization” in relation to milk and milk products as the process of heating the product in a sealed container continuously to at least 115°C for 15 minutes. This treatment ensures that the milk can be preserved at room temperature for a period of not less than 30 days.
In-bottle sterilised milk is a shelf-stable dairy product produced by sealing milk in glass bottles and subjecting it to high-temperature heat treatment. Typically, the milk is heated to temperatures ranging from 110°C to 121°C for 15 to 30 minutes. This process effectively destroys all vegetative microorganisms and bacterial spores, making the milk microbiologically safe and extending its shelf life up to 6–9 months without refrigeration. The heating is usually done in batch retorts or autoclaves after the milk has been bottled and sealed. Although the process ensures safety, it often leads to a slight cooked flavour and some nutritional losses, particularly in heat-sensitive vitamins such as vitamin B1 and vitamin C.

The National Policy on Urban Street Vendors (2004) defines street vendor as a person who offers goods for sale to the public without having a permanent built-up structure but with a temporary static structure or mobile stall (or head load). Street vendors may be stationary occupying space on the pavements or other public/private areas, or may be mobile in the sense that they move from place to place carrying their wares on push carts or cycles or baskets on their heads, or may sell their wares in moving trains and buses. The total number of street vendors in India has been estimated to be ten million and the number of street food vendors has increased sharply in the past few years (Bhowmik 2005).

The preparation and sale of street food is an age-old activity with historical roots and complex socio-economic and cultural implications. Street food vendors are mostly outside the regulation of the governments and unregistered thus making them an informal sector. Similar to most other informal sector enterprises street food operations too are carried out with minimal investment, infrastructure and as familial operations. Street food outlets are seen mushrooming at crowded public places like bus stands, cinema halls, market areas and parks. They operate as temporary structures or as pushcarts parked near the roadside or at pavements. Most street food vendors operate their food stands alone and are able to generate sufficient income for sustenance.

Abstract

This review presents an idea on the botanical description, medicinal properties and traditional usage of wild, edible and aromatic plant (Nymphaea alba) in the human nutrition. Nymphaea alba Lin, also known as the White Water lily, White Lotus, or Nenuphar is an aquatic flowering plant of the family Nymphaeaceae. Nymphaea is a weed in India and its production pretty much as good as water chest nut and Nelumbo nucifera. Its rhizome is rich in tannic acid, gallic acid, alkaloids, sterols, flavonoids, glycosides, hydrolysable tannins and high-molecular-weight polyphenolic compounds. It is used as associate aphrodisiac, anodyne, antiscrophulatic, astringent, cardiotonic, demulcent, sedative and antiinflammatory. Further, it conjointly produces calming and sedative effects upon the nervous system, and is beneficial within the treatment of sleep disorder, anxiety and similar disorders. Moreover, the content of starch in the rhizome is said to be 40%. Extensive work has been carried out on agronomic and phenotypic properties for most plants, but relatively little study has been carried out on the properties which are of direct technical and economic interest to competitive food and nonfood industry. Non-conventional food resources and their value addition have attracted attention in the recent yearsfor their potential use as functional ingredients in food formulations, besides food they have also been used for non-food applications. Moreover, Plants provide the predominant ingredients of medicines in most medical traditions.
