Introduction

Food adulteration compromises quality of foods and causes human health hazards is a menace mankind had been facing since ages. Spice adulteration scandals in the year 2004, Horse gate scandal in Europe during 2013 are famous examples of food fraud. Various forms of food adulteration and cheating such as substitution of cheaper food components in place of original product, addition of non-permitted substances, and false claims by misbranding or mislabeling are prevalent from time immemorial (Spink et al 2019).

Different basic as well as advanced laboratory equipment need to be used in a laboratory while conducting experiments. Many of them like pH meter, laminar air-flow hood, viscometer, thermometer, magnetic stirrer, microwave ovens, incubators, sand-bath, water-bath, oil-bath, etc. are the basic and simple equipment which require to be used routinely while conducting experiments in a laboratory. However, basic knowledge of their operation, handling procedure, when to be used, how to be used, and more importantly what not to be done with it, etc. are essential for keeping them in serviceable condition as well as for the accuracy/precision in their operation. In this chapter, we will discuss about some of the routinely used laboratory equipment along, while some other sophisticated equipment will be discussed in other chapters.

pH Meter

A pH meter measures exactly the H+ concentration of a solution; thus indicates acidity or alkalinity of a solution with greater precision. Actually, it measures the difference in electrical potential between a pH electrode and a reference electrode, and display the results converted into the corresponding pH value. Electrode is the key part (rod-like structure, usually made of glass) of a pH meter, having a bulb at the bottom containing a sensor. The pH meters range from simple and inexpensive pen-like devices (portable/pocket pH meter) to complex and expensive laboratory instruments with computer interface (Figure 5.1).

Frequent calibration of a pH meter using the solutions of known pH (standard solution of pH 4.01, 7.00, 10.01, Figure 5.2), generally before each use, ensures the accuracy of the instrument. For very precise work the pH meter should be calibrated before each measurement. For normal use calibration should be performed at the beginning of each day. This is necessary because the glass electrode does not give a reproducible measurement over a longer period of time.

Labelling is a critical component of food regulation, consumer communication, traceability, and brand credibility. This chapter examines the regulatory requirements governing ice cream and frozen dessert labelling in India, with emphasis on FSSAI standards and declarations. It explains the distinction between product standards and label declarations and introduces systems for managing recipe masters, nutrition information, label copy, artwork, and packaging approvals. Mandatory declarations, ingredient information, allergen declarations, nutritional information, claims, and common labelling errors are considered. The chapter also identifies departmental responsibilities and best practices for label compliance. Proper regulatory control ensures accurate consumer information, reduces legal risk, and supports consistent packaging and commercial operations.

Ice cream is an emotional as well as a technical product, often associated with happiness, celebration, indulgence, family experiences, and personal enjoyment. This chapter explores the principles of brand building and marketing strategy in the ice cream industry. It explains the difference between a product, label, and brand and examines consumer understanding, product quality, packaging, pricing, visibility, trade marketing, distribution, and innovation. The chapter also addresses launch strategies for new brands and the role of leadership in building long-term brand equity. A successful ice cream brand must combine a clear consumer promise with consistent product quality, availability, attractive presentation, efficient distribution, and memorable consumer experiences.

A boiler is a sealed vessel designed to heat water or other liquids, producing steam or vapor for various applications, including heating, power generation, cooking, and industrial processes. The operation of a boiler is similar to that of a pressure cooker but on a larger scale. The steam or vapor generated is used for domestic or industrial purposes, with the system usually involves involving combustion products that heat the water. INTRODUCTION

The concept of hurdle technology has been developed as a new way to realize safe, stable, nutritious and economical foods. It employs combination of different preservation techniques to achieve a multi-target, mild but reliable preservation of foods. The application of hurdle technology in food preservation is increasing rapidly worldwide. Over the years, insight into the hurdle effect has been broadened and the application of hurdle technology has been extended. A better understanding of the occurrence and interaction of food preservative factors (hurdles) in foods is the basis for improvements in food preservation. If the hurdles for the microbes are known, the microbiological stability and safety of this food might be optimized by changing the intensity or quality of these hurdles. Using the proper combination of hurdles, it is possible to improve not only the microbial stability and safety but also the sensory and nutritive quality as well as the economical aspects of food. The hurdle concept is also referred to as food preservation by combined methods, combined process, combination preservation or combination processing techniques. The hurdle effect is of fundamental importance for the preservation of foods. The illustration of hurdle effect was first introduced by Leistner in 1978. Based on the understanding of hurdle effects, the concept of hurdle technology was derived (Leistner 1985).

INTRODUCTION

A mixture is a combination of two or more elements or compounds in any proportion so that the components do not lose their identity. Most materials in our world are mixtures and very few materials are pure substances. Foods are complex mixtures of compounds and the extraction or separation of food components is fundamental for the preparation of ingredients to be used in other processes. Separations usually aim to remove specific components in order to increase the added value of the products, which may be the extracted component, the residue or both. Purposes include cleaning, sorting and grading operations, extraction and purification of fractions such as sugar solutions or vegetable oils, recovery of valuable components such as enzymes or flavour compounds, or removal of undesirable components such as microorganisms, agricultural residues or radionuclides. For example, cooking oils from oilseeds or gelatin from connective tissue; or for retrieval of high value compounds, such as enzymes (e.g. papain from papaya for meat tenderisation or rennet from calf stomachs for cheese making). Other types of separation methods are used to sort foods by separating them into classes based on size, colour or shape and to clean them by separating contaminating materials.

Life forms are composed of one of two basic cell types : Eukaryotic or Prokaryotic. Generally, eukaryotic cells are larger and more complex than the prokaryotic cells and possess a membrane-enclosed nucleus; eukaryotic means ‘true nucleus’ (eu=true; karyon = nucleus). All plants, animals, fungi, protozoa and algae are composed of eukaryotic cells. Only the microorganisms classes as bacteria and the archaea are prokaryotic cells. Prokaryotic cells have no nuclear membrane and therefore lack a true nucleus. The latin prefix pro means ‘early’ and in this instance suggests the somewhat primitive nuclear structure found in bacterial cells. Eukaryotic microorganism are sometimes simply referred to as eukaryotes, and the prokaryotic microbes as prokaryotes.

Food Safety and Standards Rules and Regulations-2009

    1.    The Food Safety and Standards Act, 2006 has been passed by the Parliament with the intention to integrate all present food laws into one and to have a single regulatory body.

    2.    Accordingly the Food Safety and Standards Authority of India (FSSAI) has been established under the Food Safety and Standards Act, 2006 (FSS Act, 2006) with the mandate to lay down science based standards for articles of food and to regulate their manufacture, storage, distribution, sale and import, to ensure availability of safe and wholesome food for human consumption.

    3.    In exercise of the powers conferred by section 91 of the Food Safety and Standards Act, 2006 (34 of 2006), the Central Government hereby makes the rules and regulations.

    4.    ‘‘Anti-oxidant’’ means a substance which when added to food retards or prevents oxidative deterioration of food and does not include sugar, cereal, oils, flours, herbs and spices.

1. Introduction

Fermented milk products such as yoghurt are produced through out world (Kurmann et al., 1992). Yoghurt can be characterized as a gel like coagulated milk product, having a smooth consistency and a pleasing flavour and is now widely consumed both by infant and adult populations. It is common that yogurt preparation involves the use of equal amounts of two lactic acid bacteria (LAB): Streptococcus thermophillus (St) and Lactobacillus delbrueckii ssp. bulgaricus (Lb); samples prepared with these starter bacteria are labeled Lb-St (Ng et al., 2011). In the early stage of the incubation process, Lb stimulates the growth of St releasing amino acids from casein (where the most important is valine) and producing a moderate reduction in pH due essentially to St. Yoghurt has better digestibility than milk and this is related to its comparatively high content of free amino acids. Besides nutritional value, it possesses hypocholesterolaemic (Mann, 1977) and antitumour effects (Odd et al., 1983; Reddy et al., 1983).Yoghurt may be set or stirred and has a potential for being used as dietary supplement for infants. So they cross the line between dietary supplements, health foods and conventional foods with great facility. Now a days, emphasis is given on sweeteners and more natural sweeteners will be used (Hollingsworth, 2001). Natural sweeteners can be easily incorporated in yoghurt by blending cattle milk with fruit pulps like mango. The enhancement of other nutrients e. g. vitamins and minerals will be added advantage. Mango pulp which contains a high proportion of sugar, mostly monosaccharide, is easily adsorbed by the digestive systems (Celik and Bakirci, 2003).

Soybean is a comparatively inexpensive source of high quality protein. The protein and fat contents in soybean are above 40 % and 20 %, respectively. Nutritionally, soy protein is a more balanced plant protein for human consumption. Studies have indicated that consumption of soy protein decreases total serum cholesterol and minimizes risks for several cancers (Anderson et al., 1995; Messina, 1997; Zind, 1998). The positive health benefits associated with soybeans have greatly increased its consumer awareness which has created a large market for soy foods (Ohr, 2000; Liu, 2000). The problem of beany flavour in soy products can be overcome by lactic acid fermentation (Buono et al., 1990; Granata and Morr, 1996). Soy solids are not only abandoned source of protein but also have therapeutic properties against breast, prostate, colon and lung cancers due to its isoflavones like genistein and daidzein content. Fortification with soy made yoghurt beneficial in lowering cholesterol level and blood pressure and in relieving symptoms of menopause and osteoporosis.

Production and operations management is the process of conversion of inputs into outputs, using physical resources, so as to provide the desired utility/utilities —of form, place, possession or state or a combination thereof—to the customer while meeting the other organizational objectives of effectiveness, efficiency and adaptability. It distinguishes itself from the other functions such as personnel, marketing etc. by its primary concern for ‘conversion by using physical resources’. Figure 1.1 describes a generalized concept of production system. It takes resource inputs and processes them to produce useful outputs in the form of goods or services.

Agricultural food production is increased by adopting scientific farming methods and another way to increase the availability of food is preventing the food spoilage by adopting food preservation methods. The global agricultural and fish production accounts for 50% of perishable food, which requires preservation. Only half of the perishable foods are properly protected. Application of innovative technologies to promote the production of food is indispensable to meet the demand of emerging populations. It is equally important to protect the stored food from the invasion of pests and diseases. A food saved is a food produced.

Food Processing and Preservation, branch of manufacturing that transforms raw animal, vegetable, or marine materials into tasty, nutritious, and safe food products. The industry has its roots in ancient times, as humans have always needed to obtain food and store a portion for later use. Prehistoric humans may have dried fruits in the sun and stored meat in cold areas, such as ice caves. The modern food processing and preservation industry was born in 1809, when French chef and inventor Nicolas Appert, searching for a better way to provide food for Napoleon’s army, devised a method for sterilizing food in tightly sealed glass bottles.

Today a wide variety of methods are available to maintain and enhance the appearance and taste of food. Food processing and preservation methods also create products that are convenient for consumers, such as products that are ready to eat or require minimal preparation and cooking. Combining these methods with modern distribution networks makes seasonal crops available year-round in grocery stores all over the world.

2.1 Introduction

Many complicated engineering principles are to be analyzed and applied, before any food processing operations takes shape of a commercially viable enterprise. The size and type of the required equipments have to be specified and their sequences have to be arranged. Further, the process analysis consists of understanding of material and energy balances. This chapter provides the application of steady state conservation of mass and energy equations to analyze food-processing operations.

4.1 Introduction

The food preservation may be define as the state in which the food may retained over a period of time without being contaminated by pathogenic organism or chemicals and without losing its colour, texture, flavour and nutritional value. All the methods of food preservation must provide such an environment in and around the preserved food so that it produces one or more unfavourable conditions to the continued activity of the spoilage agents. The various methods used for food preservations are:

5.1 Introduction

The medium used in various unit operations of food process engineering such as heating, cooling, drying, mixing and transport processes, is moist air, which is a mixture of two substances. One of these is dry air which itself is a mixture of number of gases and the other is water vapour which may exist in a saturated or superheated state. The properties of moist air are called psychrometric properties and the subject, which involves determination of thermodynamic properties of moist air, is known as psychrometry. Thus, psychrometry is that branch of engineering science, which deals with the study of moist air i.e. dry air mixed with water vapour or humidity. Knowledge of properties of moist air is imperative in design of systems such as air- conditioning equipment for storage of fresh produce, dryers for drying of cereal grains, and cooling towers in food processing plants. In this chapter, important thermodynamic properties used in psychrometric computations are defined. Psychrometric charts useful in determining such properties are presented. In addition, various psychrometric process used in food process engineering are discussed.

Introduction

Water is not only a vital environmental factor to all forms of life, but it has also a great role to play in socio-economic development of human population. Since antiquity humans have valued the importance of clean water and have used various techniques to improve its quality. In modern times, the safe drinking water became first a public health issue and then a human rights issue. The access to safe drinkin gwater now considered as a basic human right which is an essential component of effective policy for health protection. Improving access to safe drinking-water can result in tangible as well as intangible benefits to health. It has been shown that investments in water supply and sanitation can yield a net economic benefit, because the reductions in adverse health effects and healthcare costs outweigh the costs of undertaking the interventions (WHO, 2017). Past experiences have also proved that interventions in improving access to safe water favour the poor in particular, whether in rural or urban areas, and can be an effective part of poverty alleviation strategies. The disparity in water availability, reliability, and quality between the developed world and developing countries is enormous. Unfortunately, in many developing countries people lack access to safe water and therefore waterborne diseases are still a major cause of death, especially among children under age of 5. According to a joint report by World Health Organization (WHO) and United Nations International Children’s Emergency Fund (UNICEF) (WHO/UNICEF report 2017), around 2.1 billion people worldwide lack access to safe and readily available water at home, and around 4.5 billion, lack safely managed sanitation facilities. Moreover, many of these countries that have set drinking water standards often lack the resources to implement or enforce them.

India, with its unique agro climatic conditions is capable of producing a wide variety of fruits and vegetables. These highly perishable produce in both fresh and processed forms are of high demand in domestic as well as international market. Nowadays farming is becoming an enterprise and shifting towards consumer driven agriculture. Produce quality measurement is of utmost importance as consumers are more quality conscious and ready to pay higher for quality. Consumer preference is moving towards healthy food, minimally processed and, fresh cut fruits and vegetables, prepared salads, ready to cook, ready to eat and ready to drink health beverages. Hence health, nutrition, convenience, quality and safety of produce should be guaranteed to the consumers. Due to globalisation of production and trade, legislations and standards for markets are strict and product quality is the necessity for competitive markets.

Quality of a produce, based on subjective and objective measurement, is defined differently by consumers, wholesalers, retailers, processors or any other who is associated with it and varies with market either national or international. Quality of foods may be defined as the composite of those characteristics that differentiate individual units of a product, and have significance in determining the degree of acceptability of that unit to the user (Kramer, 1965). According to ISO (International Organisation of Standardisation), “Food quality is the totality of features and characteristics of a product that bear on its ability to satisfy stated or implied needs” and as per CAC (2003), “Food safety is the assurance that food will not cause harm to the consumer when it is prepared and/or consumed according to its intended use”. Food safety is the most important component of quality.

Food is a resource of immense importance and its safety in the whole production and supply chain, is very crucial. In the last century, drastic increase in the incidence of food borne illnesses, large-scale food poisoning outbreaks and surfacing of new foodborne pathogens and hazards were widely reported. Contaminants can enter food through various pathways in the food production process, and can occur naturally or as the result of inferior or inadequate production practices. Concerns on food safety are fuelled by the industrialization of agricultural production, liberalization of trade, tourism, food consumption pattern and food preparation practices. The availability of information through the mass and social media increases the number of reported cases of inadequate food safety. International competitiveness depends more on quality and safety concerns than on prices and this creates a need for safer food production and distribution practices.

Food Safety is the assurance that food is acceptable for human consumption according to its intended use. The slogan of the World Food Safety Day 2019 “If it’s not safe - it’s not food!” portray, unsafe food is a threat to mankind. Ensuring food safety to protect public health and promote economic development is of utmost importance and it remains a significant challenge in both developing and developed countries. Food borne diseases remain a real and formidable problem, causing great human sufferings and significant economic losses. According to WHO 2019-20 World Water Day report, one third of the population of developed countries may be affected by food-borne diseases each year and the problem is likely to be even more wide spread in developing countries, where food and water borne diarrhoeal diseases kill an estimated 2.2 million people each year, mostly children. While unacceptable rates of food borne illness still remain, new hazards continue to enter the food supply.

A food safety hazard refers to any agent with the potential to cause adverse health consequences for consumers. It occurs when food is exposed to hazardous agents which result in contamination of food. In other terms it can be defined as anything that could contaminate food or could otherwise violate established food safety program criteria, if left uncontrolled. The National Advisory Committee on Microbiological Criteria for Foods (NACMCF, 1997) defined a hazard as a “biological, chemical, or physical agent that is reasonably likely to cause illness or injury in the absence of its control”.

A hazard may be introduced into the food supply any time during harvesting, formulation and processing, packaging and labelling, transportation, storage, preparation and serving. Food safety hazards are generally categorized into four classes: Physical, chemical, biological and allergens. Food manufacturers can adopt Food Safety Management Systems (FSMS), which include Good Manufacturing Practices (GMP), Good Hygiene Practices (GHP), Hazard Analysis and Critical Control Point (HACCP) and other practices to strictly check the hazards and make the food safe.

Understanding the hazards that contribute to food borne illness and injury is important to determine the necessary steps to prevent or reduce it to an acceptable level or eliminate hazards altogether before food reaches the consumer.

Fruit and vegetable development starts with formation of an edible part fruit setting, seedling emergence, tuber development and ends with loss of edible character, or spoilage through physiological deterioration, development of fibrous character or spoilage through microbiological intervention . The state of maturity of a fresh horticultural commodity is therefore is a continuum process along the development scale. The term mature implies that point in the development scale when the horticultural commodity in the state that is ready to use (consume, process, store). For the packing house, maturity means suitability for storage followed by sufficient shelf life to assure profitable supply to markets. On the other hand, the retail consumer may value colour, flavour, or textural attributes. This implies that maturity and an appropriate compromise must be achieved through the marketing process.

Quality, on the other hand, relates to the degree of the satisfaction that the consumer or customer is likely to obtain through the use of mature commodity. Maturity and quality are interrelated with market expectations or requirements. These expectations or requirements are expressed through regulations or guidelines of grower groups or through legislative authority expressed as quality standards or grades and enforced through inspection agencies associated with government departments.

Introduction

Food is the most vital prerequisite for sustenance of human life and provides adequate nutrients for the metabolism. Recently several hypothesis supports that, beyond meeting nutritional needs, they play beneficial roles in improving health, and minimize the risk of illnesses (Roberfroid, 2000a). In this way, a novel term “functional food” was introduced and plays an outstanding role in improving the overall conditions of the human body (e.g. pre- and probiotics), lessening the threat of some ailments (e.g. cholesterol-lowering products), and also as therapeutics for several diseases (Roberfroid, 2000a, Roberfroid, 2000b, Mollet and Rowland, 2002).

Recently throughout the world, an extensive array of functional foods were developed which includes prebiotics, probiotics, synbiotics, foods supplemented with anthocyanins, phytosterols, isoflavones, antioxidants, and fat, sugar and salt-reduced foods. Amongst them, probiotic functional food has exerted beneficial effects on the health and is comprised of both probiotic dairy foods and probiotic non-dairy foods. The demand for dairy probiotic foods are increasing as it attributes to the beneficial health effects on the host by improving the survival of gastrointestinal microflora, production of bioactive compounds and prevention of lactose intolerance. Consequently, production of these foods is a significant research importance for both food manufacturing units and research institutes.

Probiotics are the important ingredients for foods with a “healthy” image. It could be combined with other beneficial ingredients or simply used to supplement the natural functional qualities of whole foods. The amalgamation of probiotic bacteria with nutrient rich foods, like dairy products, will have the additional value of improving consumer nutrition.

Preamble

Historically, food has been an integral part of human civilization and diet with varied food components has sustained human life on this planet over the centuries. Similarly, culturing of food with natural fermentation as means of preserving foods with extended shelf life for future use. In the background of sustaining food security, advances made in biotechnology and molecular biology has provided ample scientific platform to use the advances in increasing and expanding food production on a global magnitude, so as to meet the needs of an ever-growing world population.

The intestinal microbiota is a key component of both the metabolism and immunity of humans and animals. The desirable microbes do have a significant role to play in healthcare through control of digestive disorders and foodborne illnesses. The continued research in this area over the years has led to the identification of important molecules that regulate major functional attributes in the betterment of human health and wellness in the long run. The science and technique of genetic engineering through molecular biology approaches has enabled in enriching the beneficial molecules for the benefit of human life. The accuracy in targeting and designing of molecules will go a long way in developing genetically modified (GM) lactic acid bacteria (LAB) and GM probiotics to significantly rewrite the medical care with food-based approach in the form of targeted specific diets – “Dietomics”.

Abstract

Starch is an important plant-based product and an abundant biomaterial, used worldwide for different purposes in many industrial sectors including food, health, chemical and engineering sector. Starch versatility in industrial applications is largely defined by its physicochemical properties and functionality. Starch in its native form has limited functionality and application but advancements in technological processing have led to the wide-range modification of starch for different purposes. It can be easily degraded by microorganisms hence is a natural source of bioenergy in the form of bioethanol and biohydrogen as well as in the development of biodegradable packaging materials. Various technological interventions can significantly improve the characteristics of native starch and be tailor-made to the specific needs of the packaging and food industry. Native starch can be treated by various methods to modify its characteristics. Modification improves starch paste clarity, viscosity, syneresis and freeze-thaw stability leading to a wide range of food applications. Esterification lowers gelatinization temperature and retrogradation lowers the tendency to form gel and higher paste clarity which shows applications in refrigerated and frozen foods, as emulsion stabilizers and for encapsulation. Cross-linking increases the stability of granules towards swelling, high temperature, high shear, and acidic conditions. Starch-based nano-composite polymers have their application in coating and packaging of food as well as non food commodities. Techniques involving extrusion, casting, spinning, and nanotechnology can be used in the production of films, foams, and nanocomposite materials. Due to the unique characteristics of resistant starch, it is being used as a valuable supplement in the formulation of drugs, pharmaceuticals, various functional foods and in the microencapsulation of probiotics and bioactive compounds.

It is an eminent actuality that the diets of end users are being advanced globally; however, the patterns of food procurement and food safety protocols diverge across countries. Packaging: Packaging is an industrial and marketing technique for containing, protecting, identifying and facilitating the sale and distribution of agricultural, industrial and consumer products. Packaging is defined as an enclosure of products, items or package in a wrapped pouch, bags, box, cup, bottle or any container form to perform one or more of the functions as containment, protection and preservation, communication and utility or performance. Technically, packaging is a system or method by which a product from the manufacturing point to the consumer level reaches in a safe and sound condition at an affordable cost. The primary purpose of the packaging is to protect the food product, to keep it in good condition and to preserve the flavour until it reaches the consumer. It is therefore, very essential that a suitable form of the packaging is chosen for a finished product. Packaging is an art, which determines the buying decision of a consumer. or Wrapping / placement of objects in paper / other packaging materials keeping in box, etc is known as packaging which has two main functions, to assemble the produces / objects in convenient units for handling and to protect them during transporting, marketing and storage which results in extended shelf life of the produce. “Packaging” play a very important role not only in ensuring safety of the product during transportation, storage and distribution and in conveying information about the pack contents to the consumers, but also ensuring desired sensory characteristics and micro-biological soundless till consumed.

Fruits and vegetables are more perishable and generally have a higher value compared to cereals, making them very important in terms of minimizing waste and improving employability in the food industry. The losses in fruits and vegetables are significant, but through effective post-harvest processing, these losses can be reduced, and surplus produce can be better utilized. This processing involves a variety of techniques that prepare fruits and vegetables for conversion into processed foods. 1. Introduction

The demand for non-dairy based beverages in form of non-dairy milk is on rise due to several reasons. Firstly, the prevalence of lactose intolerance and milk allergy amongst a major percentage of population who cannot consume dairy milk and look for alternate source of proteins. The need for functional drinks is also a major factor which contributes to the increase in demand of milk-alternatives. It has also been reported that milk processors around the world face an uphill battle, including the dominance of private labels; consumer concerns over the presence of growth hormones in non-organic milk; fluctuations in commodity prices; supply shortages for organic milk; and growing consumer concern about the safety of animal products in general. With that long list of challenges, the market has had few growth opportunities even though consumers continue to prize milk for its nutritional benefits.

2. Need for Non-dairy Beverages

2.1 Prevalence of lactose intolerance

Lactose intolerance is estimated to affect 33 % of the global population, but the prevalence of the condition varies from country to country. It is also estimated that an average of 75 % of human adults have decreased intestinal lactase activity after weaning (NDDI, 2012).

1. The Aflatoxin Molecule

Aflatoxins are chemically difuro-coumarin derivatives. Presently, 18 different types of aflatoxins have been identified with aflatoxin B₁, B₂, G₁, G₂, M₁ and M₂ being the most common. Of these Aflatoxin B₁ (AFB₁) and G₁ occur most frequently, with AFB₁ being the most potent. Physicochemical and biochemical characteristics of the AFB₁ molecule reveal two important sites for toxicological activity (Heathcote and Hibbert, 1978). The first site is the double bond in position 8,9 of the furofuran ring (Figure 1). The interactions of aflatoxin, DNA and proteins, which occur at this site alter the normal biochemical functions of these macromolecules and leads to deleterious effects at the cellular level.Monteiro et al. (1966) studied the in vitro interaction of groundnut proteins namely arachin and conarachins with AFB₁ molecule. The second reactive group is the lactone ring in the coumarin moiety (Lee et al., 1981). The lactone ring is easily hydrolyzed and is therefore vulnerable to degradation.

There is no single factor as important in the production of fine quality dairy products as absolute and complete cleanliness.

It is not enough to provide milk for man, it must be high quality milk. It would be impossible to provide man with milk and milk products of superior quality if we were unable to remove milk soil and to kill residual microorganisms. Respectively, these are the processes of cleaning and sanitizing.

To successfully provide the atmosphere for proper food safety, the basics must be thoroughly understood. The basics of food safety begin with good understanding of sanitation processes, food-handling procedures that protect from, or eliminate cross contamination problems and specific attention to inspection of and follow up for all processes. Food safety activities need to be programmed into available time of day scheduling just as production requirements do. Whether special personnel or separate shifts handle cleaning responsibilities or you clean as you go on the production line, time must be made available. Safe products leaving the facility must be the watch word of all employees involved with the process.

In order to ensure safe food supply a high level of sanitation should be maintained throughout the food production chain. The word ‘sanitation’ is derived from the Latin word “sanitas” which means “health”. To further apply this word to the food industry, sanitation is the creation and maintenance of hygienic and healthful conditions when processing, preparing and handling food. Sanitation is the application of science to provide wholesome food handled in a hygienic environment by healthy food handlers to prevent contamination by food spoilage microorganisms. Effective sanitation refers to the mechanisms, which accomplish these goals.

7.1 Introduction

Fisheries are emerging as one of the fastest growing food production system all-over the world. The potential for fisheries development world over and especially in India is highly promising in view of physical and biological resources available coupled with technological development. The demand for fish fishery products is ever increasing as the awareness of health benefits are being made available to public at large. The world fish production has not kept pace with demand which means less and less fish is available. Nevertheless, a large fraction of this valuable commodity is wasted due to deterioration after landing or consumer preference. An estimate by FAO [1] indicates nearly 20-25% of the total catches are wasted as postharvest loss. Better utilization of aquatic resources should therefore, aim primarily at reducing this enormous loss by improving preservation of fish and fishery products and upgrading the discarded low value fish to high value fishery products. The processing of fish into different types of products generates considerable waste. Commercially, fish is being processed into fillets, steaks, mince, canned products and a variety of ready-to-eat products. Fish processing plants contributes substantial wastes in the form of skins, bones, offal, exoskeletons from shrimps and nutrients in wash water from surimi plants.

Fish processing waste utilization is an important issue for the seafood industry both from a regulatory standpoint as well as one that has potential economic impacts. It is estimated that only 25-50% of the raw material is utilized for primary products (fillets, canned and stabilized mince production). The remaining 50-75% of the raw material is considered processing waste and is utilized for low-value products or disposed-off at sea. A large volume of solid waste is currently processed into fish meal, fish protein hydrolysates, and fertilizers. A small percentage is processed into higher valued items, such as, seafood flavourants, colourants, chitosan, enzymes, etc.

8.1 Introduction

Spices are appetizers and hence, esse ntially used in the culinary preparations. They also possess antioxidant, antimicrobial and antibiotic properties. Further, they possess medicinal properties and hence, play an important role in human health.

According to International Organization for Standards (ISO), there is no clear cut division between ‘Spices’ & ‘Condiments’ and as such they have been clubbed together. The term ‘Spices’ & ‘condiments’ applies to “such natural plants or vegetable products or mixtures there of, in whole or ground form, which are used for imparting flavour, aroma and piquancy and seasoning of foods”. Spices are divided into different groups based on their plant components such as floral, fruits, berries, seeds, rhizomes, roots, leaves, kernel, aril, bark, bulbs etc.

About 70 spices are grown in different parts of the world and a major portion of these are grown in India. Hence, India is called “The home of Spices”. It is well known that spices played a significant role in ancient times, in the development of civilization – the life of the people and trade among the nations of East and West. Spices like ginger, pepper and turmeric have an intense and immediate impact on sensory perceptions and exhibit strong physiological effects as food and medicinal constituents. Some spices and herbs like cardamom, saffron and vanilla, which have less intense but more delicate sensory effects, are well known for their contribution to fragrance and usage as food flavouring agents. The history of spices and their use in food and medicine in ancient India have been reviewed earlier [1-3].

Farmers have one commodity or the other in surplus and need to be disposed off or sold to earn some money to satisfy other needs, which otherwise cannot be satisfied on the farm or in the village. Thus, agricultural marketing has two-fold objective i.e. Sale of surplus commodities and buy other commodities to satisfy family needs. In modern commercial agriculture, the surpluses with farmers are steadily rising, so also their family needs are changing with the change in lifestyle. Therefore, agricultural marketing has assumed important place. Traditionally, market is place or building where buying or selling of goods takes place. But, in modern times with fast and long distance communication facilities like telephone, market is no more restricted to a particular place only, but it has become wider and has assumed regional, national or even international status. Buying and selling is finalized on telephones only from distant places. Thus, the concept of market has radically changed.

Knowledge about market is critical for the success of the product in such a highly competitive global market place. Tuber crops, though branded as poor man’s crops in rural areas have considerable unrealized potential for processing into high end products for food, feed and industrial uses. They are generally consumed as vegetable after boiling it in water and eaten along with some spicy curry or by extracting starch or flour. Besides serving as an insurance crop during times of food scarcity, it can also function as an industrial raw material for a wide spectrum of products

Milk, an integral component of our staple diet is nature's most ideal and complete food. There is a long history and tradition of high consumption of dairy products in India. Consumption pattern of dairy products in India is quite unique and is centred on traditional products; however, novel products are gradually gaining momentum in urban areas. Despite being the largest milk producing country in the world, India accounts for a negligible share in the worldwide dairy trade. Domestic demand for dairy products is showing an increasing trend and it is expected that demand-supply gap will further widen which might transform India being a net importer of dairy products. Nowadays, quality is not a matter of choice but a necessity and even a responsibility of all stake holders. In the case of food, the term, 'Quality' refers to physical, chemical, microbiological, technological, economic and aesthetic characteristics. From consumer point of view, the word, 'Quality' embraces mostly the organoleptic characteristics like body, texture and flavour than the objective properties like fat, protein, lactose and acidity as determined by science based tests.

Humans have primarily consumed "meat/meat products based on where they lived and how they evolved. According to Food Safety and Standards Act 2006, “meat means fresh meat, poultry and game meat which could be in the form of whole pieces, cuts or comminuted (minced etc.), whereas, meat products are those that have been processed by various methods so that they no longer resemble fresh meat”. These products include meat, poultry, and game products in whole pieces or cuts that are cured salted and dried, processed by non-heat treatment, fermented non-heat treated products, heat treated or frozen products. Edible casings used for sausages etc. also come in the category of meat and meat products. Through a notification dated 12^th September, 2017, the FSSAI has included domestic rabbits (Oryctolagus cuniculus) in the Food Safety and Standards (Food Products Standards and Food Additives) Regulation 2011 in the regulation under meat and meat products.

With the advent of globalisation, there has been an increase in food trade which has led to the introduction of exotic meat and meat products. Moreover, rapidly growing economies like India, now demonstrate a growing appetite for meat. As the consumer demand for high quality meat is increasing in most countries, the meat industry should consistently produce and supply quality meat that is safe and healthy for the consumer to ensure continued consumption of meat products.

Horticulture is increasingly recognized as a sunrise sector, owing to its potential to raise farm income, provide livelihood security and earn foreign exchange through export. The diverse agro-climatic conditions and rich diversity in crops and genetic resources enable India to produce a wide range of horticultural crops round the year. To cite an example, India produces tropical fruit like mango and sub-tropical fruit like an apple at the same season in a year (Jha et al., 2019). The horticulture sector encompasses a wide range of crops like fruits, vegetables, flowers, spices, plantation crops like coconut, beverages like tea and coffee, and some medicinal and aromatic plants. Statistics provided by National Horticulture Development Board showed that India is the second largest producer of the commodities, after China, accounting for 13 per cent of the global production of fruits and 21 per cent of vegetables. Economic reforms and policies further increased the speed of diversification in favor of horticulture crops (Jha et al., 2019). This is on account of the increased domestic demand from high-value food commodities as well as for export markets. The diversification process that is seen within the agricultural sector also got transmitted to the horticultural sector. In line with the emerging demands, India has taken several technical and policy initiatives for promoting horticulture.
