In most countries there is no legislative definition of the term drawing a border line between conventional and functional foods is challenging even for nutrition and food experts. Functional foods do not have a specific place in food law; consequently there is a great deal of confusion about what they are, could or should be. A common perception is that functional foods are foodstuffs either with one or more specific added ingredients (components), or certain substances of common ingredients (components) removed and which are claimed to have a positive influence on human health or well being. The term ‘functional foods’ for this group of products is considered to be an unfortunate one since all foodstuffs are or should be functional and a more appropriate term might be helpful.

Introduction

The tenet “Let food be thy medicine and medicine be thy food,” said by Hippocrates nearly 2,500 years ago, is receiving renewed interest. In particular, there has been an explosion of consumer interest in the health enhancing role of specific foods or physiologically active food components called as functional foods [1]. Clearly, all foods are functional, as they provide taste, aroma, or nutritive value. Within the last decade, however, the term functional as it applies to food has adopted a different meaning - that of providing an additional physiological benefit beyond that of meeting basic nutritional needs.

Abstract

Functional foods and nutraceuticals are one of the fastest-growing segments of the food industry. The demand for these foods is driven by health conscious consumer and the growing awareness of the close connection between diet and health, particularly in relation to chronic diseases. Over the past five years (20082012), the Indian Nutraceuticals Market has been growing at a rapid pace and is expected to rise to US $ 5 billion by 2015. The rapid growth and development of this new industry combined with the need to protect consumer health and interests, has led to the evolution of a myriad of different regulatory frameworks and policies across multiple markets. Japan was one of the first countries to recognize a different category of healthier food products. The Japanese government formally accepted this category in the 1980s. Other developed countries viz. The EU, The US, Canada etc also regulated this sector during 1990s. In India, the Food Safety and Standards Act 2006 (FSSA) was enacted in 2006 in response to pressure from stakeholders and the food industry, transforming the regulation of food in India. Punjab state, with abundance of food grains and increasing trends in fruits and vegetables, provides options for both the producer and growth promotion in the nutraceuticals sector through partenship between research centers, private entrepreneurs and indigenous communities. Regulatory frameworks should focus on the protection of consumers, promotion of fair trade and innovation in the sector. This paper discusses functional foods and nutraceuticals as per food regulations prevalent in various countries and highlights how these regulatory frameworks play a major role in transforming the food sector.

Introduction

The health and wellness continue to drive growth in the global food industry as the consumers are constantly looking for the foods, beverages and other dietary solutions that will help them more aggressively to meet their own unique nutrition and personal health goals. Worldwide countries are going through a nutritional transition and are now affected by double burden of problems like nutritional and food security. The common alarming problems are under nutrition and specific nutrient deficiencies simultaneously coupled with imbalanced diets and chronic diseases. The problem of chronic diseases, non-communicable diseases (cardiovascular diseases, respiratory diseases, diabetes, obesity, cancer etc.) and malnutrition is more serious in the developing countries. The lack of access to health services, sufficient income, healthy and nutritious foods characterize majority of poor people in developing countries. So, food is not only the solution but also viewed as a product to enhance health and wellbeing, and it encourages the producers by supplying new goods that meet these needs. From the past decade, there has been growing consumer awareness regarding health, nutrition and the food safety which are often triggered by specific food incidents, especially in the developed countries and high-income groups in such countries. In the food industry there have been two broad trends which are hazards in the food chain and nutritional profile of the food. There has been recognition that hazards and contaminants can enter the food chain and can cause sickness, death and diseases, and so governments, often to deal with consumer and industry concerns, establish regulations and standards on food hazards including standards on pesticides, antibiotics, microbiological hazards and other chemical and physical contaminants. On the other hand, there is also a growing awareness of the health-enhancing properties for prevention and treatment of health concerns beyond the basic nutritional component of many foods.

Introduction

Increasing knowledge regarding the impact of diet on human health along with state-of-the-art technologies has led to significant nutritional discoveries, product innovations, and mass production on an unprecedented scale. In particular, naturally occurring bioactive extracts or single compounds thereof, that are believed to benefit human health, have spawned an important and dynamic new area of research resulting in substantial advances in nutritional knowledge. There is also growing awareness that dietary source and form of food may affect overall health. Suitably, the role of food as an agent for improving health has been recognized, initiating the development of new classes of food, known as functional foods (Honkanen 2009).

The concept of functional foods is to improve the general conditions of the body and decrease the risk of illness and disease. That is to say, bioactive compounds present as natural constituents or as fortificants in food having the potential to provide health benefits beyond the basic nutritional value of the product. Marine-derived nutrients and other marine bioactive components have excellent potential as functional food ingredients as they possess advantageous physiological effects, with medicinal characteristics and added health benefits such as anticancer or anti-inflammatory activity.

The marine world, due to its phenomenal biodiversity, is a rich natural resource of many biologically active compounds such as polyunsaturated fatty acids (PUFAs), sterols, proteins, polysaccharides, antioxidants and pigments. Many marine organisms live in complex habitats exposed to extreme conditions and, in adapting to new environmental surroundings, they produce a wide variety of secondary (biologically active) metabolites which cannot be found in other organisms. Moreover, considering its great taxonomic diversity, investigations related to the search of new bioactive compounds from the marine environment can be seen as an almost unlimited field.

INTRODUCTION

A food may have three attributes (1) Provide energy and nutrition (2) Give pleasure, i.e., enjoyable aroma, colour, and taste and (3) Health benefits. Functional food has physiological benefits and reduces the risk of chronic disease beyond basic nutrition.

Functional foods, also reported as ‘nutraceuticals’, ‘medical foods’ or ‘designer foods’ in the literature, were first described by Roberfroid (1999) as ‘Food similar in appearance to conventional food that is intended to be consumed as part of a normal diet, but has been modified to subserve physiological roles beyond the provision of simple nutrient requirements’. Examples are iodized salts, vitamin A and vitamin D fortified milk and yoghurt, folic acid enriched bread, soy products, wheat bran and oats products.

Nutraceuticals and Health Foods

    1.    According to the International Food Information Council (IFIC), functional foods are “foods or dietary components that may provide a health benefit beyond basic nutrition.”

    2.    Nutraceuticals : A product isolated and purified from foods that is generally- sold in medicinal forms are usually associated with food. A nutraceutical is demonstrated to have a physiological benefit or provide protection against chronic disease (Coined originally by Stephen DeFelice in 1989, founder and chairman of the Foundation for Innovation in Medicine, USA).

    3.    The International Life Sciences Institute of North America (ILSI) has defined functional foods as “foods that by virtue of physiologically active food components provide health benefits beyond basic nutrition

    4.    Health Canada defines functional foods as “similar in appearance to a conventional food, consumed as part of the usual diet, with demonstrated physiological benefits, and/or to reduce the risk of chronic disease beyond basic nutritional functions.”

1. Introduction

A confection is sweet tasting delicacies developed using sugar and other carbohydrates with optionally selected chocolate, nuts, fruits, vegetables or gums. Depending on the formulation, the confection may vary from sugar boiled hard lozenges to gum based soft gummy toffees, from chewing gums to mouth melting chocolates. The versatile and broad variation in the product created by differentiating flavours, ingredients and processing has greatly influenced the market demand of these products. Although confection is non-essential commodity but still relished by people of all economic strata and hence creating a great market space and scope of new products.

In confectionery research and development area, current popular sector is functional confections. The sector has been on the trends radar globally, accounting for 8% of the global confectionery market, and most accepted and successful in Japan.

15.1 Introduction
Milk is a multifaceted physiological fluid that aids infants in their transition to life outside the womb by supporting digestion and development, as well as providing essential nutrients and bioactive components. It promotes the development of beneficial microflora and enhances the growth of lymphoid tissue. Recent research indicates that the quantity and importance of bioactive compounds in milk may be greater than previously believed. Through research, the distribution and presence of essential components in various animal milks have been analyzed. The consumption of dairy products has been linked to health benefits that mitigate the adverse effects of obesity and overweight. These benefits include a decreased likelihood of being underweight, reduced blood pressure, and a reduced risk of stroke, colon cancer, and osteoporosis. Dairy products provide a valuable combination of nutrients, such as proteins, fatty acids, vitamins, and minerals, that are essential for the maintenance of blood health, the support of the nervous and immune systems, the improvement of vision, the support of muscle and nerve function, the maintenance of skin health, the maintenance of energy levels, and the overall growth and repair of the body. Furthermore, dairy products can function as carriers for bioactive compounds and may provide a variety of health benefits, such as improved immune function, reduced risk of cardiovascular disease, reduced bone mass loss, and protection against free radical damage, when consumed in an appropriate quantity. Incorporating fruits and vegetables in a variety of forms—including fresh, desiccated, powdered, juiced, pureed, pulped, or extracted—into dairy products such as yogurt, ice cream, and cheese also presents an opportunity to improve their health benefits.

Abstract

Seaweeds are the large marine algae that grow almost exclusively in the shallow waters at the edge of the oceans. Seaweeds are rich sources of many bioactive compounds and nutraceuticals. These factors are considered under two categories: Seaweed phytochemicals and Seaweed polysaccharides. They are rich in soluble dietary fibers, proteins, minerals, vitamins, antioxidants, phytochemicals, and polyunsaturated fatty acids, with low caloric value. The red, brown and green seaweeds have been shown to have therapeutic properties for health and disease management. Usually they are only used as gelling agent and stabilizers in the food and pharmaceutical industries, but current research has revealed their potential medicinal uses against many diseases like cancer, allergy, diabetes, oxidative stress, inflammation, thrombosis, obesity, hypertensive and other degenerative ailments. In line with other natural foods like fruits, vegetables and grains, there has been marked interest within the scientific community to assess which fractions of seaweeds may be linked to the historically observed health benefits. As consumer health and nutrition become more influential in the food industry, the use of seaweed as an ingredient is on the rise in product development. For several centuries there has been a traditional use of seaweeds as food in China, Japan and the Republic of Korea. This review undertakes successful exploration of potential of seaweed gums as an functional ingredient in a number of food applications. This addition has the potential to enhance the nutritional quality of a product and hence human health.

Introduction

One of the main properties of fermented foods whether alkaline or acidic is the presence and activity of beneficial organisms which themselves make these foods functional. These functional micro organisms have varied roles like conversion of the native constituents of raw materials to forms in which they are more bioavailable, formation of taste, colour and flavouring compounds thereby imparting pleasantness to foods, removal of anti-nutritive factors in food by converting them into much less harmful compounds or degrade certain native toxic elements present in food, formation of biopreservatives which will extend the shelf life of foods and provide microbial security, as pathogens and spoilage microorganisms fail to readily grow in such hostile conditions. These functional microorganisms also produce in foods certain health-promoting bioactive compounds like enzymes, vitamins, minerals or increase the digestibility which may not have been in the original food or raw material before fermentation. In other words they improve the nutrition profile of the foods or naturally fortify foods. Some of these beneficial effects may also lead to the formation of certain compounds which show antioxidant properties in foods. These very roles played by these functional micro-organisms form criteria in their selection for use in food fermentations when they are intentionally added to foods both to initiate and accomplish desired fermentations.

We all eat food because it provides the nutrients that are needed for the various functions of the body. Energy is required for growth and repair of tissues, to maintain body temperature and for physical activity. Energy comes from foods which are rich in carbohydrates, proteins and fat. This provides energy to the body from other nutrients and helps to keep the skin and nervous system healthy. They help towards the various biological activity in the human body. These nutrients are grouped into carbohydrates, proteins, lipids (fat), water, vitamins and minerals. These are used for growth, maintenance, repair and other needs of the body. Protective foods are which contain adequate amounts of vitamins, minerals and high-quality proteins which protect against the development of a deficiency disease. There are various chemical reactions taking place within each cell of a living organism. These provide energy for vital processes and for synthesizing new organic materials. This process is known as Metabolism. Living organisms get energy from the environment and use it for movement, growth, development and reproduction.

The term probiotic means “for life” and it is currently used to refer bacteria that are associated with beneficial effects for humans and animals. The credit for first observation made on the positive role of some selected bacteria was attributed to Eli Metchnikoff, the Russian born Nobel Prize recipient, worked at the Pasteur Institute in the beginning of the last century. Metchnikoff suggested that - “the dependence of the intestinal microbes on the food makes it possible to adopt measures to modify the microflora in our bodies and to replace the harmful microbes by useful microbes”. Interim Henry Tissier, a French paediatrician, observed that children with diarrhea in their stools had a low number of bacteria which are characterized by a peculiar Y shaped morphology. On the contrary, these “bifid” bacteria were abundant in healthy children. Based on these observations, Tissier suggested that “bifid” bacteria could be administered to patients with diarrhoea to help restore a healthy gut microflora. These two scientists were the first to give scientific intimation for the use of probiotics when even the term probiotics was not coined. Later in 1965, the term probiotics is coined by Lilly and Stillwell to describe substances produced by one microorganism, that stimulate the growth of another. Subsequently, Parker defined probiotics as organisms and substances that contribute to intestinal balance. Further, Fuller (1989) improved the Parker’s definition of probiotics as “live microbial feed supplements which beneficially affect the host animal by improving its intestinal microbial balance”. Havenaar and Huis in’t Veld (1992) extended the probiotic definition with the description: “A viable mono or mixed culture of microorganisms which, applied to animal or man, beneficially affects the host by improving the properties of the indigenous microflora”. At the end of the millennium, Salminen and his coworkers (1999) proposed the following definition: “probiotics are microbial cell preparations or components of microbial cells that have a beneficial effect on the health & well- being of host”. Whereas FAO/WHO (2001) defined probiotics as “living bacteria that, when administered in adequate amounts, confer a health benefit on the host”. This definition for probiotics is widely accepted.

Fermented foods and beverages comprise an indispensable part of the human diet. They can be generally defined as those foods and beverages produced via controlled microbial growth and conversion of various substrates using either enzymes or as whole cell itself, as shown in Figure 1.

The future of functional foods is bright and there are several reasons for the growing interest in “functional” foods, such as awareness of personal health deterioration, led by busy lifestyles with poor choices of convenience foods and insufficient exercise; increased incidence of self-medication; increased level of information from health authorities and media on nutrition and the link between diet and health; scientific developments in nutrition research; and a crowded and competitive food market, characterized by pressurized margins. Now, the consumer is well aware of the relationship between diet and health. Consumers understand that the risk for chronic diseases such as heart disease, stroke, colon cancer, and type II diabetes is possibly preventable by modification in their diet pattern. This scientific progress in understanding the relationship of diet to disease, along with increasing health care costs and the consumer’s desire to initiate healthy eating and lifestyle habits, makes this a potentially fertile ground for the development of food products that meet these demands.

In spite of the problems with dosage and viability of probiotic strains, a lot more work is required for industry standardization and safety issues. However, it is noted that probiotics have considerable potential against many pathogenic and other diseases. A wide range of clinical trials are still needed to standardize and optimize the conditions. Ongoing basic research will continue to identify and characterize existing strains of probiotics, identifying strain-specific outcomes, determine optimal doses needed for certain results and assess their stability through processing and digestion.

With recent work it has become clear that bacterial societies are very complex. Gene expression in bacterial communities are heterogenous. The heterogeneous gene expression contributes towards the biofilms in fluctuating environments which needs to be understood.Technique like single-cell analysis can help in the investigation of more complex communities. Recently, Jahid and Ha, (2012) have written a review on microbial biofilms of produce and the future challenges to food safety many outbreaks have been observed involving food- borne pathogens. Therefore, there is an urdent need for the safety of foods especially against microbial attacks and biofilm formation as they cause a risk to public health. Medically, the pathogenic microorganisms form biofilm- associated with the epithelial or endothelial lining which are embedded in the lungs, intestinal or vaginal mucus layer, the teeth or other medical implant surfaces or formed intracellularly (Dewasthale et al., 2018). Teichoic acids are characteristic major components of the cell surface in Gram-positive bacteria.

Benjamin et al., (2016) have focused on the small-scale food processing enterprises (SSFPEs) as one of the important measures for national development and addressing food security challenges, particularly in Nigeria. The authors have explained the need for food processing as there has been tremendous food losses and wastages in the country. Enhancing the food processing and productivity for mechanization of food processing unit operations, development of new and existing technologies, design and development of machinery, systems for processing and preservation of different agricultural produce of high target have been undertaken. SSFPEs have played an important role in the economy of a developing country, particularly in terms of employment creation, income generation, post-harvest losses reduction, food preservation, value addition, improvement of food safety, nutritional quality, increase in shelf-life of a product and to act as training grounds for entrepreneurs before they invest in large scale enterprises. SSFPE’s around the world and especially in Nigeria are faced with significant challenges that compromise their ability to function and contribute optimally to the economy. Financial constraints and lack of management skills are the major constraints. It is important that governments and non-governmental organizations must encourage and facilitate the development of SSFPE’s. The mention of specific companies or products of manufacturers, whether or not these have been patented, does not imply that these have been endorsed or recommended by FAO or GAIN in preference to others of a similar nature that are not mentioned. Technology transfer (TT) is entering a transformative phase shaped by globalization, digitization, and the growing role of start-ups in the innovation ecosystem. Traditional linear models of TT where inventions flowed from academic laboratories to industry through licensing are being replaced by dynamic, multi-directional, and collaborative frameworks. This chapter explores emerging trends that will define TT in the coming decades, including open innovation platforms, digital TT ecosystems powered by artificial intelligence (AI) and blockchain, the rise of entrepreneurial start-ups and spin-offs, internationalization of TT through cross-border collaborations, and sector-specific shifts driven by 5G, biotechnology, drones, and green energy. Drawing from global and Indian contexts, the chapter highlights how universities, governments, and industries can leverage these trends to build inclusive, resilient, and sustainable innovation ecosystems.
Three global shifts which will redefine TT
1. Digitization of knowledge: With AI, big data, and blockchain, knowledge and IP can be shared, tracked, and commercialized faster and more transparently.
2. Entrepreneurial ecosystems: Start-ups, incubators, and accelerators are replacing traditional firms as vehicles of commercialization, particularly in deep-tech and frontier technologies.
3. Globalization of innovation: Challenges such as pandemics, climate change, and food security require cross-border TT collaborations, making TT an instrument of both economic and geopolitical significance.

Introduction

The world does not function without mathematics. In our day-today life we come across many problems which are solved mathematically. The mathematical logical system follows “Yes” or “No”, “True” or “False”, “1” or “0” which are precise outputs for the precise inputs. There are several ambiguous or vague problems which cannot be given with accurate precise value with the conventional logical operators. Beyond this Boolean logic operator the logical system which mimics the human brain and gives precise solutions for the imprecise linguistic variables is the Fuzzy logic system. Fuzzy logic is a novel approach that intends to imitate human reasoning using calculations and operations with fuzzy systems and linguistic variables. The problems with vague imprecise data which we come across in our day today life cannot be solved by conventional binary logical method. The fuzzy logic solution spontaneously splits a complex problem into its component parts. This reduces the solution to its component parts. Compilers may re-assemble the code for effective execution on some target, but at the programmer level the problem is a number of simple tasks.

Fuzzy sets theory was introduced by Zadehin the year 1965, and it allows uncertain phenomena to be treated mathematically.

1. Proteins in solution absorb ultraviolet light with absorbance maxima at 280 and 200 nm. Amino acids with aromatic rings are the primary reason for the absorbance peak at 280 nm. Peptide bonds are primarily responsible for the peak at 200 nm.
2. Aromatic amino acids tyrosine and tryptophan give proteins their characteristic ultraviolet (UV) absorption at 280 nm, which is routinely used to estimate protein concentration. Phenylalanine and disulfide bonds also contribute to absorption at 280 nm, albeit slightly.

1.1. Introduction

The significance of milk as the most wholesome single food available in nature has never been debated. It is as ancient as mankind itself, as it is the substance created to feed the mammalian infant. All species of mammals, from the lowly rat to the mighty whale, produce milk for this purpose. Several centuries ago, perhaps as early as 6000-8000 BC, ancient man learned to domesticate species of animals for obtaining their milk for consumption. These included cows, buffalos, sheep, goats and camels, all of which are still used in various parts of the world for the production of milk for human use (Fig. 1.1 & 1.2).

Even after public concern the scientists feel that the GMO foods are quite safe. According to them the genetically-engineered crops are very safe to eat as much as the non-GE of the same crop. According to them the environment has improved by reducing the use of pesticides. GMO stands for genetically modified organism. Soy, corn, or other crops are very common as GM crops which are made by genetically engineered DNA. Many have come to the conclusion that GM foods are safe, healthy and sustainable. However, some people are against them. There are many benefits of GM crops like less water or pesticides to be used. Genetically engineered crops fight diseases to save the foods. At the same time the industries/ farmers that grow them are also benefitted. These foods have higher nutritional profiles, both in the US and abroad like corn which is one of the most prominent GMO foods. Soy is found in tofu, vegetarian products, soybean oil, soy flour and many other products. The other major crops taken for genetic modification are Papayas, Canola and Cotton. For dairy products a lot of work is being done on the genetic engineering of animals in a big way. This is going to be the most intractable environmental challenge of the 21^st Century. Presently, around 92% of the U. S. corn (GE), 94% of soybeans and 94% of cotton are genetically engineered.

GENETIC ENGINEERING

Genetic engineering is a means of improving the food supply even before harvest or slaughter by improving yields, increasing disease resistance, and enhancing the nutritional qualities of various foods. Broadly speaking, genetic engineering refers to any deliberate alteration of an organism’s DNA. Genetic engineering has been practiced for thousands of years, ever since humans began selectively breeding plants and animals to create more nutritious, better tasting foods. In the past two decades, genetic engineering has become increasingly powerful as scientific advances have enabled the direct alteration of genetic material. Genetic engineering is alternately called as ‘ recombinant DNA technology’ or ‘gene cloning’. Genes have been cut and pasted from one species to another, yielding, for example, disease- resistant squash and rice, frost-resistant potatoes and strawberries, and tomatoes that ripen-and therefore spoil-more slowly.

Genetically modified organism (GMO) is a microbe or more complex plant or animal in which DNA has been altered for a particular purpose such as manufacturing proteins, making improvement to the organism, research into the nature of genes and biological process, correcting genetic defects.

Diversity of gut microbial community

The human microbiota (the collection of microbes that live on and inside us) consists of about 100 trillion microbial cells that outnumber our ‘‘human’’ cells 10 to 1, and that provide a wide range of metabolic functions that we lack. It has been estimated that they encode 100-fold more unique genes than our own genome. Furthermore, the gut microbes contribute to energy harvest from food, and changes of gut microbiome may be associated with bowel diseases or obesity. To understand and exploit the impact of the gut microbes on human health and well-being it is necessary to decipher the content, diversity and functioning of the microbial gut community. If we consider ourselves as superior organisms encompassing these microbial symbionts, by far the majority of genes in the system are microbial. In this sense, completing the human genome also requires the characterization of the microbiome (the collection of genes in the microbiota).

Methods of counting viable and non-viable bacteria in gut

Before the advent of genome sequencing and genome-wide analysis method, our knowledge of molecular characteristics of diverse gut microbial population was extremely limited. To obtain an estimate of cultivability, microbial ecologists generally compare microscopic counts with total viable counts. The total viable count made on a nonselective agar based medium estimates the number of colony forming units (cfu) per gram of sample. The finding that total viable counts are typically lower than total microscopic counts was thought to be due to the number of dead cells. Indeed, dead bacteria in feces may constitute up to one third of the total bacterial community. However, recent nucleic acid based studies indicated that a majority of bacteria in a variety of ecosystems are different from those described in culture.

Introduction
Ghee is the pure clarified butter fat prepared chiefly from cream and/or desi butter (Makhan) to which no colouring matter is added.  Ghee manufacture has great significance and relevance to Indian masses and the dairy industry. Ghee is a very popular product since ancient time and has greater demand during festival and other ceremonial functions where use of ghee in food has been considered to delicacy due to its pleasing flavour and aroma. There are sufficient recorded evidence to prove that the manufacture of ghee originated from India and has been used extensively for religious and dietary purposes since Vedic times. Presently about 28% of total milk production is utilized for manufacture of about 1 million tones of ghee per annum. It is the traditional product with an established market. Cow ghee is golden yellow in colour, and is attributed unique therapeutic value.  The colour of buffalo ghee is greenish yellow due to presence of pigments called billirubin and billiverdin. Ghee is characterized by its pleasant, cooked and rich flavour. The preferred texture is of larger uniform size from grains having non-greasy consistency.

It is an eminent actuality that the diets of end users are being advanced globally; however, the patterns of food procurement and food safety protocols diverge across countries. The fundamental rationale of the trend is that the consumer awareness with regard to food safety, quality and variety has been proliferated greatly. Looking back to the history of food industry, it is unquestionable that the past has a full frame of misfortune, indignity and many disastrous incidents. Moreover, the entire muddle was not always related with microorganisms; numerous of them were associated with environmental problems, technological advancements or certain alterations in production protocols and management.

Introduction

Meat derived from animals are subjected to various contaminations from number of sources. The animal itself is a major contributor of both pathogenic and spoilage organisms. Further contamination may be introduced from water used, equipment used for product preparation, from the meat handlers and the surrounding environment. Microbiological problems such as food poisoning or spoilage may arise when the desired effect is not achieved and is usually due to errors in the handling or processing procedures. The detection and rapid correction of such errors and their future prevention is a major objective of any quality control system.

In traditional approach to meat and meat product quality control system, only the samples of the final product were analyzed by laboratory test to check for compliance with specifications. However, the responsibility for control of hazards rests with individuals involved in all stages from farm to ultimate consumer. And the control of hazards at each stages of food chain may be achieved by Hazard Analysis Critical control point (HACCP). Hazard analysis critical control point is an internationally recognized system that helps to ensure the manufacture of safe food products. HACCP is not a zero risk system but rather a system designated to minimize the risk of food safety hazards. HACCP concept is a systematic and rational approach Firstly by consideration of the hazards i.e., microorganisms or their toxins, that need to be controlled in a specific operation by structured hazard analysis and secondly on the identification of the most effective means of controlling the identified hazards. This system, by focusing attention on the factor that directly affects the microbiological safety and quality of meat foods, eliminates wasteful use of resources and superfluous consideration. As a consequence, the cost/benefit relationships are more favorable. The system is applicable at all levels of meat food chain from farm production through processing, transporting, merchandising and ultimate use in the meat food service establishment or at home. Ensuring food safety and quality is the responsibility of all links in the food chain. Now a day’s food consumers are very much health conscious and they want their food to be safe and of good quality. As meat being highly perishable and high risk food product, it is very much imperative on the part of meat and meat products producers and exporters to produce safe and quality meat to stand in the competitive world and further hygienic meat processing is important not only to provide safe and wholesome meat but to provide a good public image and to increase consumer demand.

31.1 Introduction
A fundamental element of quality assurance is good manufacturing practice (GMP), which ensures that goods are consistently produced and regulated according to the quality standards suitable for their intended application and as outlined by the marketing license. The primary objective of GMP is to mitigate risks in pharmaceutical manufacture, which may be categorised into two main types: erroneous labelling and cross-contamination/mix-ups. Primarily, manufacturers must guarantee that their goods are safe, effective, and of adequate quality; hence, risk assessment has become a crucial component of WHO quality assurance guidelines.
31.2 Implementation of HACCP
31.2.1 HACCP Preamble and Definitions Preamble
1. The introductory portion of this publication delineates the concepts of the Hazard Analysis and Critical Control Point (HACCP) system as endorsed by the Codex Alimentarius Commission. This section provides broad recommendations for system application, recognising that implementation specifics may differ according to the food operation’s unique conditions.
2. The HACCP system, grounded in scientific principles and methodical methodology, identifies specific dangers and implements control measures to assure food safety. It functions as an instrument for hazard evaluation and the implementation of control systems aimed at prevention rather than predominantly on final product testing. The HACCP system is flexible, allowing for modifications in equipment design, processing methods, or technology innovations.
3. HACCP is relevant across the whole food chain, from initial production to ultimate consumption, and its use must be guided by scientific knowledge on dangers to human health. In addition to improving food safety, the use of HACCP can provide other substantial advantages. Furthermore, the use of HACCP systems can streamline regulatory inspections and enhance international trade by increasing confidence in food safety.

During the latter part of the 20^th century, rapid economic development in most countries coupled with population growth propelled the inevitable demand for more food and manufactured goods. However, requirement of more food is placing unprecedented demands on agriculture and natural resources. Humans have made agriculture the dominant environmental threat by clearing forests, cultivating marginal lands, and intensifying farming in sensitive landscapes and watersheds. Most of the land use systems in the tropics are characterized by a rapid decline in productivity and high rates of soil and environmental degradation which need to be addressed in a proper way.

Agriculture has changed radically since the end of World War II. Productivity of most crops has scaled to new levels because of the adoption of new technologies, machines, increased chemical inputs, and government policies. However, continuing agricultural production without harming the environment is a challenge, which must be tackled along with economic growth. Some of the environmental issues related to agriculture are top soil loss, groundwater contamination, air pollution, greenhouse gas emission, decline of family farms neglect of the working conditions of farm labourers, new threats to human health and safety by the spread of new pathogens, economic concentration in food and agricultural industries, and disintegration of rural communities (Brodt et al, 2011). This situation prompted world nations, political leaders, scientists and planners to pay more attention to the concept of sustainable development. As a concept, sustainability is concerned with the continuity of environmental economic, and social aspects of human society.

Government initiatives aimed at supporting small-scale enterprises and fostering women’s entrepreneurship are crucial for driving economic development, job creation, and social empowerment. Small-scale enterprises, including micro, small, and medium enterprises (MSMEs), play a vital role in the economy by contributing to employment, innovation, and poverty reduction. Similarly, women entrepreneurship offers significant potential for promoting inclusive growth, tapping into underutilized talent, and advancing gender equality in business leadership.

Small-scale enterprises often face challenges like limited access to funding, poor infrastructure, regulatory barriers, and market limitations. Women entrepreneurs, on the other hand, encounter additional obstacles such as socio cultural norms, limited access to resources, and gender biases in the business world. To address these issues, governments globally have introduced policies and initiatives aimed at supporting small enterprises and encouraging women’s participation in entrepreneurship.

Small and medium-sized industrial units, or small scale industrial (SSI) units, are generally referred to as SMEs, according to the Ministry of Micro, Small and Medium Enterprises. The MSMED Act of 2006, which was updated in 2020, serves as the foundation for the definition of SMEs in India.

• Micro manufacturing and services units: Up to Rs. 1 crore in investments and up to Rs. 5 crore in revenue.

• Small manufacturing and services units: Up to Rs. 10 crore in investments and up to Rs. 50 crore in revenue.

• Medium manufacturing and services units: Up to Rs. 50 crore in investments and up to Rs. 250 crore in revenue.

Small and Medium-sized enterprises (SMEs) constitute the backbone of the global economy. SMEs not only provide major contributions to national GDPs, but they also play an important role in job creation, innovation, and regional development. In India, SMEs account for about 30% of the country’s GDP and employ over 110 million people, making them an important part of the economic structure.(FICCI,2023).

The Government of India has accorded ‘high priority’ status to the food processing industry. The Ministry of Food Processing Industries (MOFPI) has been set up as a nodal agency for formulation and implementation of the policies and plans for the food processing industries.

With an overall objective of positioning India as the ‘Food Basket’ to the world, several initiatives have been undertaken with the objective of promoting investments, innovation and bringing best practices. This vision is in line with the ‘Make in India’ initiative of the Government (CII, 2019).

5.1. Policy Interventions (MOFPI, 2019)

5.1.1. Infrastructure Development

Fragmented, inadequate, and inefficient infrastructure along the supply chain has been identified as one of major factor inhibiting growth of food processing sector. As adequate investment for infrastructure has not been forthcoming from private sector, government will continue to assist, participate and incentivize creation of supply chain infrastructure for food processing sector.

Fruit and vegetable development starts with formation of an edible part fruit setting, seedling emergence, tuber development and ends with loss of edible character, or spoilage through physiological deterioration, development of fibrous character or spoilage through microbiological intervention . The state of maturity of a fresh horticultural commodity is therefore is a continuum process along the development scale. The term mature implies that point in the development scale when the horticultural commodity in the state that is ready to use (consume, process, store). For the packing house, maturity means suitability for storage followed by sufficient shelf life to assure profitable supply to markets. On the other hand, the retail consumer may value colour, flavour, or textural attributes. This implies that maturity and an appropriate compromise must be achieved through the marketing process.

Quality, on the other hand, relates to the degree of the satisfaction that the consumer or customer is likely to obtain through the use of mature commodity. Maturity and quality are interrelated with market expectations or requirements. These expectations or requirements are expressed through regulations or guidelines of grower groups or through legislative authority expressed as quality standards or grades and enforced through inspection agencies associated with government departments.

3.1 Introduction

The production of food grains in India is around 200 million tonnes and most of the grains are converted to primary products after primary processing such as threshing, dehulling, de-branning. Some of the grains are converted to secondary products such as flour or grits. The yields of primary and secondary products range between 65-80% indicating a wastage of 20-35%. These wastes lead to unclean surroundings and air pollution due to fine dust. Hence, proper waste management/utilization of food grain processing industries has become a societal need for a clean environment.

The term ‘waste’ has different meanings to different people. It can be retractions from the main process or less utilizable by-products or undesirable waste material depending on the commodity. All food-processing industries generate wastes and create problems for its management. The best way the food processing industry can treat its waste is to avoid producing it. Much of the waste now being produced or generated in some food processing plants can become a managed resource for producing economic credits. In fact, waste utilization is one of the world’s prominent industries and its activities cut across the normal divisions into which industries are placed. Similarly, there will be wastes from agriculture, animal and meat industries, textile, rubber etc. Even the local governmental activities that collect and dispose the household wastes become apparent in terms of the huge size of it.

The term growth as applied to higher organisms such as animals commonly is concerned with increase in protoplasmic mass and does apply to reproduction or to increase in number. In microbiology the term refers to increase in the number of organisms. Bacteria increase in number by a process of simple binary fission. Each cell increase in size and redivide into two similar cells. Each of the divide cells may in turn divide to become two cells. Each division produces what is termed as new generation of cells, theoretically there are 2,4,8,16,32,64,128,256 cells in the 2,3,4,5,6,7,8,& 9th generation, this is known as logarithmic growth – the population doubles with each successive generation. Under favourable conditions, bacteria produce generation within 15min. Under unfavourable conditions 24 hours of more may be needed for each generation. Generation time for E.coli is 17 to 20 minutes.

Over centuries, spices have been used as an important addendum for colour, flavour and preservation of foods. In addition, their medicinal and cosmetic utilities have been widely recognized (Purseglove et al., 1981; Srinivasan, 2005). All these benefits made them extremely desirable with an ever growing demand in the international market. India holds the title of the largest producer and exporter of spices with major share for pepper, capsicum, turmeric, ginger cardamom, seed spices, curry powders, spice oils and oleoresins. The other primary producers of spices includes China, Indonesia, Malaysia, Egypt, Turkey Brazil and Mexico while USA, Europe, Japan, East Asian and Middle East countries are their major importers.

Spices are made from diverse plant parts viz. rhizomes, barks, leaves, fruits and seeds and hence its processing methods vary depending on the raw material. However, the basic unit operations namely harvest, pre-treatment, drying, cleaning, particle size reduction, packaging and microbial decontamination in sequence remains common for the production of most of the spices. Inappropriate conduct of basic unit operations often lead to high microbial load, aflatoxin contamination, losses of valuable compounds, change in sensory characteristics, physical damages and incorporation of contaminants in spice products (Table 1). Moreover, spices being natural products, they may be fraught with a large number of microorganisms including several pathogenic species of bacteria and fungus depending on the prevailing conditions in their cultivation areas. In addition, poor food sanitation awareness and practices in spice producing countries may worsen their microbiological safety. Although spices are nonperishable in nature due to their low moisture contents after drying, they may act as a source of microbial populations upon contact with moist food products with no further thermal treatment. The outbreak of ‘salmonellosis’ in Germany (1993) due to contaminated paprika and paprika-powdered potato chips is an example. The aforesaid disadvantages related to conventional spice production may confound their international trade unless desired objectives of food safety management schemes such as International Commission on Microbiological Specifications for Foods (ICMSF) are met. Moreover, international agencies have set standard to guarantee safe spices and augment business interests of their adherents. For example, both the European Spice Association (ESA, 2015) and American Spice Trade Association have set a maximum level of 1% w/w extraneous matter in spices (ASTA, 2017). These challenges associated with the conventional production system may be effectively addressed by preventive risk management strategy by which suitable control measures are enforced at earlier phases of food chain prior to consumption. The control measures must guarantee that the level of contamination has not exceeded the maximum permissible limit at every phase of spice production from farm to table.

Use of acid/base is common in laboratories for experiments like titration and proper safety in their handling laboratory is necessary. In this chapter we will briefly discuss about the safety measures necessary to be adopted while using acids/bases in laboratory for any experiment.

Handling of Strong Acid/Base

There are four major points that need to be taken care of while working with strong acids or bases that might be quite harmful if any accident happens.

1. Protect Yourself

Wear a lab-coat and acid-resistant gloves: Always use lab-coat/apron and make it sure that the sleeves properly cover your arms. More importantly, use gloves made of acid-resistant materials and also wear shoes to protect your feet while wearing long-pants/jeans. Female with long hair, must tie her hair properly (with rubber band) to avoid any disturbance caused by appearance in between.

Wear safety goggles: It is important to wear safety goggles to protect your eyes using larger and fitting goggles that cover front as well as sides of your eyes. Always use properly fitting and adjustable goggles because smaller/ loose goggles may not protect the areas around your eyes against accidental acid spills and it may fall down from your face, if it is too loose.

Locate emergency wash area: There must be an emergency washing area nearby the work place or laboratory containing lab spill management kits. All the workers in the laboratory must be aware of using the kits and emergency plans.

Neutralize acid: Don’t panic even if an acid or chemical spill happens. Stay calm and act as quickly as possible. In case an acid spills, neutralize it by using sodium bicarbonate so that they can be cleaned and disposed safely. If acid comes in contact of skin, wash it off under running tap water but do not use/ apply sodium bicarbonate on skin.

For proper and efficient experiment to be conducted, experimenters need so many chemicals to deal with. This includes different acids, base, salt, different kind of indicators and so on. Some of these chemicals are safe for health, but some of them are dangerous to health when come in close proximity to our body while some of the chemicals cause health issues on inhaling. These may cause improper functioning of some of our physiological activities. Acids and bases are very dangerous for our tissues when come in our contact. These may cause serious respiratory problem in addition to injuries on coming to our contact. Some chemicals are exploratory yet they may cause even death of the person working with them in laboratory. Therefore, mere use of the chemicals in laboratory is not only the objective of the experimenter. The person working in laboratory should also be concerned about the proper use and handing of the chemical while working with it. Thus, every researcher of an institution who has to work with chemicals in a laboratory should be made aware about the chemicals to be used in the laboratory and the consequences if any mishandling of a laboratory chemical occurs. Not only these, suitable precautionary measures should also be known to the researcher along with ensuring the availability of the required safety equipment/installations. Hence, a proper understanding of the ways of handling of chemicals in a laboratory is of prime importance for the personals like you who are working or have to work in laboratory.

Safe Handling of Chemicals in Laboratory

Safe use/handling of chemicals in laboratory include minimized exposure to chemicals, maintaining safety data sheets, proper labelling, storage, segregation, and transport of chemicals for personal hygiene.

We come across a variety of chemicals every day in a laboratory. While some of them are relatively safer, others are extremely hazardous. Thus, it is very important to know the potential hazards that can be caused by the chemicals present in the laboratory and the safety measures needed to be followed to avoid the hazards. Additionally, we should also be aware of the steps necessary to be taken on such hazardous situations. According to IUPAC, a hazardous chemical mean the chemical which has the potential to cause damage in various ways. In a laboratory, there are chemicals that might be irritant, carcinogen, respiratory fibrogen, systemic poison, asphyxiant, flammable, etc. which have the potential to cause hazard to the workers or environment. Therefore, it is important to use appropriate procedure to reduce the risk and protect the health/safety of laboratory personnel, the public and the environment.

Types of Hazards Associated with Chemicals

Chemical hazards: The hazards caused by chemicals can be broadly classified into three categories.

1. Health hazard: This is also known as toxic effects of chemical. The risk associated with a chemical in laboratory depends on the extent of exposure and the inherent toxicity of the chemical. Many chemical reactions form the product that might be much more toxic than the reacting chemicals. For example, inadvertent mixing of formaldehyde (a common tissue fixative) and hydrogen chloride results in the generation of bis(chloromethyl) ether, a potent human carcinogen. For most of the chemicals, the route of exposure (through skin, eyes, gastrointestinal tract, or respiratory tract) is more important (Figure 17.1) that must be considered during risk assessment.

In India, the collection, transport and distribution of raw milk involves a number of agencies and persons at rural and urban level – village producers, milk collectors, halwais (Sweet-makers), milk vendors, dairies, producer-retailers and wholesale or retail markets.

1. Collection

Usually, the milk collectors approach the small village producers to collect milk and the same is sold directly or indirectly (through agents) to a dairy (milk procurement centres) or halwais or city milk vendors or consumers. The producer – retailers themselves, in some cases, supply the milk to the above said parties. The production of milk in small, scattered holdings in village causes problems during its collection. It involves visits to many villages, some of which are not easily accessible for the purpose.

There are specific hazards associated with equipment, operation or a particular section. Such possible hazards and their preventive measures are discussed below.
I. Milk Reception Dock
    1.    Where the top of a vat, into which a 40 litre can of milk is to be dumped, is higher than the milk can, two men should lift and empty the can.
    2.    Where steam jet method of can washing is used, to avoid burning, employees would be furnished with protective equipment, including rubber boots and long aprons
    3.    Cans should be stacked in areas away from frequently used passage ways
    4.    Cans should not be stacked so high that they may fall and injure someone

Food Safety is the assurance that food is acceptable for human consumption according to its intended use. The slogan of the World Food Safety Day 2019 “If it’s not safe - it’s not food!” portray, unsafe food is a threat to mankind. Ensuring food safety to protect public health and promote economic development is of utmost importance and it remains a significant challenge in both developing and developed countries. Food borne diseases remain a real and formidable problem, causing great human sufferings and significant economic losses. According to WHO 2019-20 World Water Day report, one third of the population of developed countries may be affected by food-borne diseases each year and the problem is likely to be even more wide spread in developing countries, where food and water borne diarrhoeal diseases kill an estimated 2.2 million people each year, mostly children. While unacceptable rates of food borne illness still remain, new hazards continue to enter the food supply.

A food safety hazard refers to any agent with the potential to cause adverse health consequences for consumers. It occurs when food is exposed to hazardous agents which result in contamination of food. In other terms it can be defined as anything that could contaminate food or could otherwise violate established food safety program criteria, if left uncontrolled. The National Advisory Committee on Microbiological Criteria for Foods (NACMCF, 1997) defined a hazard as a “biological, chemical, or physical agent that is reasonably likely to cause illness or injury in the absence of its control”.

A hazard may be introduced into the food supply any time during harvesting, formulation and processing, packaging and labelling, transportation, storage, preparation and serving. Food safety hazards are generally categorized into four classes: Physical, chemical, biological and allergens. Food manufacturers can adopt Food Safety Management Systems (FSMS), which include Good Manufacturing Practices (GMP), Good Hygiene Practices (GHP), Hazard Analysis and Critical Control Point (HACCP) and other practices to strictly check the hazards and make the food safe.

Understanding the hazards that contribute to food borne illness and injury is important to determine the necessary steps to prevent or reduce it to an acceptable level or eliminate hazards altogether before food reaches the consumer.

Heat desiccated products represent khoa and khoa-based sweets, rabri, basundi, etc. These are important traditional dairy products. Traditional dairy products and a great assortment of sweets is an integral part of Indian heritage. These products are endowed with enormous value and enjoy tremendous mass appeal. Of great social, religious, cultural and economic importance these products have been developed over a long period of culinary skills and carry with them, the age-old wisdom and experience. Traditional dairy products have always played a pivotal role in preservation of precious milk nutrients and promotion of its consumption among masses. The increased availability of milk during the flush season coupled with lack of facilities to keep liquid milk fresh during transit from rural production areas to urban market has led to the conversion of milk into variety of traditional products. In addition to preservation of milk solids for longer duration, manufacture of traditional dairy products adds value to milk and also provides tremendous employment opportunity. It is estimated that about 50% of milk produced in India is converted into a variety of traditional products.

Traditional dairy products represent the most prolific segment of Indian dairy industry. These products not only have an established market in India but also have a great export potential because of strong presence of Indian diaspora in many parts of the world. In view of the growing awareness towards the safety aspects of milk-based sweets in India, the consumer shall prefer to buy these products from the organized sector. Despite the widespread popularity and acceptability of traditional milk products in the Indian market, the organized sector has so far not been able to tap into this market potential for many reasons such as lack of published literature on their technology, inadequacy of appropriate technologies for their commercial exploitation, inadequacy of appropriate packaging materials and labeling to take care of new pattern in consumer demand, low keeping quality and a lack of quality assurance systems.

3.1 Introduction

The subject of heat transfer is firmly grounded in the sciences of thermodynamics and fluid mechanics. It has become exceedingly important for engineers to possess a clear understanding of the principles of heat transfer and its application to a large number of problems. In view of process engineering, the knowledge of heat transfer and its application is most important, because heat transfer is one of the basic unit operations in the agricultural processing activities. The design of process equipments, refrigerators, boilers or type of heat exchangers, thermal treatment of food grains, cooling of perishables, pasteurizations, sterilizations, freezing of milk and fruit juices and a large number of similar applications involve consideration of heat transfer rates. There may be other situations where heat is being generated during a certain operation, and may be detrimental to the equipment and the food product. In such cases we are often faced with the task of removing the undesirable amount of heat as far as possible.

1. Herbs and Spices
       
    1.    International Standards Organization (ISO) defines spices and condiments as: Vegetable products or mixtures thereof, free from extraneous matter, used for flavouring, seasoning and imparting aroma in foods.

    2.    Rosengarten describes a spice as a product which enriches or alters the quality of a thing, for example altering the taste of a food to give it zest or pungency; a piquant or lasting flavouring; or a relish. The term ‘spice’ is thus used to cover the use of spices, herbs and certain aromatic vegetables to impart odour and flavour to foods.

    3.    Herbs may be defined as the dried leaves of aromatic plants used to impart flavour and odour to foods with, sometimes, the addition of colour. The leaves are commonly traded separately from the plant stems and leaf stalks.

1. Introduction

Fruit products have their unique identities having large content of micronutrients, polyphenols, vitamins, flavonoids and other nutritional compounds. Characteristic appearance and flavors distinguish among various fruit based products like juice, puree, jam, jelly, squash and other several varieties. Main concern of this fruit processing industry is the stability of the products throughout the post processing storage. Thermal treatment as mean of preservation of these products is the common process implemented so far. It ensures the safety of the product but lacks in retaining the nutritional intact that like of fresh fruit. Today’s consumer demand for minimally processed fruit products and “natural” fruit products tend to think of alternative thermal processing.

High pressure processing (HPP), a relatively new concept compared to conventional thermal processing, also sometimes known as high hydrostatic pressure (HHP), or ultra high pressure (UHP) processing, is a non-thermal food processing method that subjects liquid or solid foods, with or without packaging, to pressures ranging between 50 and 1000 MPa. HPP has already been established itself as an alternative to thermal processing. In food processing it is of great interest due to its ability to inactivate food borne microorganisms and enzymes, at low temperature, without the need for chemical preservatives and it is less detrimental than thermal processes to low molecular weight food compounds such as flavoring agents, pigments, vitamins, etc., as covalent bonds are not affected by pressure. Pressure-treated foods have sensory properties similar to fresh products, which is a major advantage in fruit processing as it matches consumer demand for healthy, nutritious and ‘‘natural’’ products.
