Starters are selected strains of micro-organisms deliberately added to milk during conversion into cheese, dahi, yoghurt and other fermented dairy products to bring about specific changes in the appearance, body, texture and flavour characteristics of the desired final products.

Functions of Starters

The primary function of almost all starter culture is to develop acid in the product. The secondary effects of acid production include coagulation, expulsion of moisture, texture formation and initiation of flavour production. In addition to these, the starters also help in imparting pleasant acid taste, conferring protection against potential pathogens and providing a longer shelf life to the product. These bacteria convert 1% of lactose in milk approximately to lactic acid with very little by-products such as acetic acid, ethanol, CO2 and normally with no substances causing taints and hence leading to a clean and wholesome milk souring.

LAB constitutes a group of gram positive bacteria. They are nonsporulating, nonrespiring but aerotolerant cocci or rods, which produce lactic acid as one of the main fermentation products of carbohydrates, they do not have cytochromes. They belong to the phylum Firmicuttes, class Bacilli and order Lactobacillaceae. The group includes several genera such as Lactobacillus, Lactococcus, Bifidobacterium, Pediococcus, Enterobacter, Corynebacterium, Streptococcus, Leuconostoc etc.

What new research is needed, what trials and how will the ultimate consumer and Industry benefit?
 
In Brazil, the sales of functional foods amounts to US $ 500 million per year representing about 1% of the total sale of the Brazilian food processing industry. According to a report the interests are mainly for dairy products, nutraceuticals and soy-based products. ABIA forecasts a substantial growth of 4.5-5% for this segment of the market (Stanton et al., 2001). In order to exert the health benefits beyond inherent basic nutrition, it is necessary that the activity of the probiotic culture should be maintained at very high levels during the shelf life of the product.

Moisture Content
 
Two maximum moisture levels are provided to meet different climatic conditions and marketing practices. Lower values in the first column are suggested for countries with tropical climates or when long-term (more than one crop year) storage is a normal commercial practice. The values in the second column are suggested for more moderate climates or when other short term storage is the normal commercial practice.

Bacteria are morphologically different. This characteristic is helpful in the identification of bacteria. Routine study of bacterial morphology should include examination of stained preparations. Motility should be examined by hanging drop preparation. According to the requirement, certain cell structures may be stained. Stained preparations should be made preferably from fresh agar slant cultures. Smears of Streptococcus should be made from a liquid culture. Morphology of bacteria may be described under the following terms:

1.Shape: Spherical, coccobacillary, short or long rods, filamentous, comma- shaped, curved or spiral forms.

2.Size: Spherical are measured in diameter and rod-shaped in length and breadth. Measurement is expressed in microns (µ).

3.Sides: Straight, concave, bulging, parallel or irregular.

4.Ends: Round, pointed, truncate or concave.

5.Axis: Straight or curved.

6.Arrangement: Singly, in twos, in groups of four or eight, in grape-like bunches, in long chains, or scattered irregularly, may be in bundles, angular arrangements or in Chinese letters.

7.Pleomorphism: Bacteria may differ from their typical shape. Some of the older cultures may depart greatly from their typical forms, and may show spindles, clubs, and filaments, swollen and branching forms. Variation may be both in shape and size.

8.Capsule: May or may not be present. When present, size should be noted. This requires special staining.

The human body consists of trillions of cells and to be healthy it needs variety of foods and nutrients. The food around the globe includes a variety of spices which have many health benefits. We all eat food because it provides the nutrients that are needed for the various functions of the body. Energy is required for growth and repair of tissues, to maintain body temperature and for physical activity. Energy comes from foods which are rich in carbohydrates, proteins and fat. This provides energy to the body from other nutrients and helps to keep the skin and nervous system healthy. They help towards the various biological activity in the human body. These nutrients are grouped into carbohydrates, proteins, lipids (fat), water, vitamins and minerals. These are used for growth, maintenance, repair and other needs of the body. Protective foods are which contain adequate amounts of vitamins, minerals and high-quality proteins which protect against the development of a deficiency disease. There are various chemical reactions taking place within each cell of a living organism. These provide energy for vital processes and for synthesizing new organic materials. This process is known as Metabolism. Living organisms get energy from the environment and use it for movement, growth, development and reproduction.

There are many bacteria and fungi which produce biofilms. These are made up of living, reproducing microorganisms. These microbes form communities and adhere tightly to the surfaces and are resistant to many antibiotics. Many pathogenic microorganisms form biofilms which are difficult to be removed and are harmful.Such microbial colonies produce an extracellular polymeric substance (EPS) to protect them. The dental plaque was the first documented evidence of microbial biofilms. When such microorganisms get a moist environment they attach themselves to any object and reproduce forming an attachment by secreting a slimy, glue-like substance. It is possible with metals, plastics, natural materials, medical implants, kitchen counters, contact lenses, walls of a hot tub or swimming pool. Initially it was the investigation of many scientists to show the presence of biofilms

Beneficial effects of biofilms have also been shown (Rosche et al., 2009) especially in agriculture (Bogino et al., 2013; Berlanga and Guerrero, 2016) where it can be utilized as a biological control agents. They are used as biofertilizers to enhance crop production (Timmusk et al., 2017), hazardous pollutants can be removed (Irankhah et al., 2019). 

Biofilms are resistant to antibiotics even at high concentrations (Costerton et al., 1999).This could happen when the diffusion of the antibiotic within the biofilm matrix is inefficient and results in slow growth rate of biofilm cells (Davey et al., 2000), there could be the presence of persistent cells and antibiotic-resistant small-colonies (Hogan and Kolter, 2002; Kolenbrander, 2000).Studies have proved that antibiotics can inhibit biofilm formation. An antibiotic azithromycin, is known to inhibit Pseudomonas aeruginosa biofilm. Biofilm colonies become resistant at higher concentrations of the antibiotics whereas at low concentrations these can be induced (Mah and OToole, 2001). P.aeruginosa is commonly present in the lungs of patients infested with cystic fibrosis. The clinical isolates show resistance to azithromycin (MIC>64 pg/ ml).However, low doses of azithromycin have shown improvement in lung function in patients with cystic fibrosis (Borriello et al., 2004). If antibiotics are given at low concentrations (below the MIC) than it induces biofilm formation in a variety of bacterial species. Sub-MIC concentrations of tobramycin can induce biofilm formation in P. aeruginosa. The use of antibiotics in agriculture, as growth promoters have shown to expose bacteria to low levels of the drugs and has caused havoc (Smith et al., 2002). Acinetobacter baumannii is an opportunistic pathogen giving rise to nosocomial infections causing threat to public health. Studies of biofilm-forming genes was done in A. baumannii isolates by PCR technique. To study the relationships of genes a technique based on PCR sequences along with multilocus sequence typing (MLST) were utilized (Saeed et al., 2020). Goudarzi, Mehdi et al. (2019) studied the genetic diversity and biofilm formation analysis of Staphylococcus aureus causing urinary tract infections in Tehran, Iran. The biofilm forming and adhesion encoding genes were studied along with distribution of different agr and spa types in S. aureus isolates by PCR screening and multiplex PCR. The workers found that the ability to produce biofilm was higher among MRSA strains as compared to MSSA strains. The most prevalent biofilm forming gene was icaD (77.3%), followed by icaA (76%), icaB (57.3%) and icaC (50.7%). Acinetobacter baumannii is a nosocomial pathogen which is commonly present in hospitals and is a causal organism of many diseases. A. baumannii isolates have been known as multidrug-resistant (MDR). For controlling such serious organism only molecular techniques have been found to be effective. 

With recent work it has become clear that bacterial societies are very complex. Gene expression in bacterial communities are heterogenous. The heterogeneous gene expression contributes towards the biofilms in fluctuating environments which needs to be understood.Technique like single-cell analysis can help in the investigation of more complex communities. Recently, Jahid and Ha, (2012) have written a review on microbial biofilms of produce and the future challenges to food safety many outbreaks have been observed involving food- borne pathogens. Therefore, there is an urdent need for the safety of foods especially against microbial attacks and biofilm formation as they cause a risk to public health. Medically, the pathogenic microorganisms form biofilm- associated with the epithelial or endothelial lining which are embedded in the lungs, intestinal or vaginal mucus layer, the teeth or other medical implant surfaces or formed intracellularly (Dewasthale et al., 2018). Teichoic acids are characteristic major components of the cell surface in Gram-positive bacteria.

Xanthan gum: It is a polysaccharide that is produced by fermentation of carbohydrates by a gram-negative bacterium (Xanthomonas campestris) and is a thickening and suspending agent used in pharmaceuticals and prepared foods. It is also called xanthan. Xanthan is a stabilizer produced by Xanthomonas compestris (Plate 340). Xanthan is not hydrolysed or degraded by humans.

Xanthine: A basic compound C5 H4 N4 O2 that occurs in animal or plant tissue, is derived from guanine and hypoxanthine, and yields uric acid on oxidation.

Xanthones: It is a group of yellow pigments e.g. mangiferin in mango,

Xanthophyll: Yellow hydroxyl carotene derivative (C40H550C) which is present in all green leaves together with chlorophyll and carotene. Xanthophyll is a pigment containing O2 derived from carotene.

Xeroderma pigmentosum: It is a genetic disorder inherited as a recessive autosomal trait that is caused by a defect in mechanisms that repair DNA mutations (as those caused by ultraviolet light) and is characterized by the development of pigment abnormalities and multiple skin cancers in areas exposed to the sun.

a) A Key GDP Contributor: Dairy and Livestock sector form the backbone of agriculture with 28 per cent contribution in GDP and the progress in this sector is dependent on innovative measures to increase the value for farmers as well as customers.

b) Doubling Farmer’s Income : Doubling Farmer’s Income by 2022 can be achieved by improving crop and livestock productivity, efficiency to utilize resources, increased intensity of cultivation and diversification in high value cash crops, processing and value addition of food and animal products. This price realization can be assured through market reforms and efficient market linkages.

c) Unorganised sector – a challenge : The Indian dairy sector is still characterized by strong presence of unorganized sector. Apart from the Cooperative dairy sector, in the last few years there has been a considerable growth in Private Dairy sector and Milk Producers Organization like Maahi in Gujarat. If small dairy farmers are provided with sufficient ‘value addition’ training and support, they can increase their income considerably.

d) Value addition : Further, the milk processing plants can also go for value addition and innovation and in turn pay remunerative prices to milk producers.

1. Introduction
All glassware used for bacteriological work must be meticulously cleaned and sterilized. Used and soiled glassware should be thoroughly washed to remove dirt and solid residues before drying and undergoing sterilization.
2. Cleaning of New Glassware
Borosilicate glass (e.g., Pyrex) and factory-washed soda glass require only standard washing before use. However, new, unwashed soda glass needs additional treatment to neutralize alkali content.
• Place the items (e.g., test tubes, Petri dishes, and flasks) in a suitable container, cover with a 1% tri-sodium phosphate solution, and bring to a boil.
• Remove the items, rinse with tap water, and immerse them in a 1% hydrochloric acid solution to neutralize alkalinity.
• Rinse thoroughly with tap water, followed by distilled water. Allow the glassware to dry before sterilization.
3. Cleaning of Used Glassware and Other Apparatus
• Autoclave all glassware contaminated by microorganisms (121°C for 15–20 minutes). This liquefies solid media, facilitating removal.
• Rinse the empty glassware with tap water, then warm water (50–55°C).
• Soak in a detergent solution (e.g., 1% washing soda or tri-sodium phosphate solution) and scrub with a brush.
• Rinse thoroughly with tap water to remove detergent traces, followed by distilled water.

Introduction
Ocular micrometer and stage micrometer are used to measure the size of microorganisms. The Ocular micrometer consists of a circular disk of glass which has graduations engraved on surface. A stage micrometer or objective micrometer has scribed lines on it that are exactly 0.01mm (10 micrometer) apart. Ocular micrometer is calibrated for the objective first. To calibrate the ocular micrometer for a given objective, the two scales are superimposed and determined how many of the ocular gradation coincide with one graduation on the stage micrometer scales. Thus, the distance between the graduations on the ocular micrometer can be determined and so the size of the organism can be determined.

Introduction
This method consists of mixing the microorganisms in a small amount of India ink or nigrosine and spreading the mixture over a clean slide. These two pigments are not really bacterial stain and do not penetrate the microorganisms. These pigments make the background dark thus making organisms transparent against dark background. This method is useful for determining cell morphology and accurate size as no shrinkage of cells due to heat.

6.1 Introduction
The majority of milk demand is urban, while production is restricted to rural areas in nearly all developed dairying countries. Consequently, milk must be collected and transported from production sites in the milk-shed areas to processing and distribution points in cities.
The common systems for collection (assembling) of milk are as follows.
1. Through a cooperative organisation. Established by collective or individual dairy societies. Producers are most advantageous when there are no intermediaries involved in profit labelling.
2. by contractors. Producers receive a diminished return.
3. By independent producers. Convenient for individuals who reside in close proximity to dairy processing facilities.
Note: The milk shed is the geographic region from which a city dairy obtains its fluid milk supply. India is currently contemplating the allocation of specific milk silos to individual dairies in order to facilitate their development.

7.1 Introduction
Certain bacteria are present in milk that is extracted from the udder; they increase in quantity as it is processed further. The optimal temperature range for the proliferation of typical milk bacteria is 20 to 40 degrees Celsius. The formation of unpleasant flavours, increased acidity, and other factors always results in a decline in market quality following the proliferation of bacteria. Prompt chilling to a low temperature is one method of preserving milk. Milk jug Refrigerator: In order to preserve the purity of the milk received at the Dairy/Chilling Centre, it is chilled to 4°C using a milk chiller. Stainless-steel plates comprise the chiller. The process of chilling involves the circulation of chilled water from one side of the plates and milk from the other.
7.2 Methods
1. In can or can immersion method:
The milk is not only cooled, but it also remains cold, necessitating a significantly smaller mechanical refrigeration unit. This is achieved by transporting pails.
Benefits of a surface cooler

8.1 Introduction
The chemical composition of milk intended for market or milk product manufacturing must be standardised in numerous dairy processes. Standardising milk may necessitate the regulation of a single component (typically fat) while permitting the other components to shift or regulate two or more components concurrently. Definition: The term “standardisation” of milk denotes the process of adjusting the fat and solids-not-fat percentages of milk to the desired value in order to comply with the legal or other requirements.
Objectives of standardization are
1. To ensure that specific milk and dairy products meet legal requirements.
2. To offer a consistent product to the consumer.
3. To guarantee economic efficiency in production.
The volume of milk available for sale is increased by the addition of skim milk, and the separation of cream enables the production of other value-added dairy products, such as butter, table cream, or other high-fat products.

10.1 Introduction
Developed in the 1950s, ultra-high temperature pasteurization typically involves no hold using a temperature range of 135°C to 150°C. Immediate aseptic packaging determines how well UHT heat treatment of milk works.
10.2 Uperization Developed in Switzerland, this is generally known as “ultra – pasteurization”. Milk is heated in this method under direct steam up to 150 °c for a fraction of a second. One is always learning from this. Fore warming milk to 50 °C is the first stage in the uperization process, meant to eliminate most of the dissolved oxygen and volatile off-flavours by vacuum treatment. In the second step, the milk is first preheated to roughly 80–90 °C and then heated on the uperization chamber under high-pressure steam to roughly 150 °C for ½ to ¾ a second. The product moves into an expansion chamber at almost atmospheric pressure after this heating, therefore inducing some evaporation of moisture. The good is then transferred to a chiller and subsequently into a storage chamber.
The advantages of uperization are
• Long keeping quality.
• Removal of feed and other volatile off-flavours:
• Appreciable homogenization effect.
• Reduction in acidity.
• Efficient destruction of microorganisms.
• Effect of uperization on nutritive value and flavour are not greater than that of pasteurization.

11.1 Introduction
“Homogenization” is the method of mechanical treatment producing a stable emulsion of milk fat and milk serum. Homogenizer is the name given to the equipment employed for this aim. The fat globules in milk range in size from 1 to 20 microns; the average is 4 to 6 microns. The homogenizer reduces the size of the fat globules in milk or cream passing through it. The most of them are less than two microns. After homogenization, no cream line develops on milk; churning homogenized cream cannot generate butter grains. Moreover, milk like cream’s viscosity is changing, which increases the resistance the smaller fat globules face. The increase in viscosity is ascribed to the fact that more milk protein will be deposited on the surfaces of more fat lobules. Homogenizing milk changes its clotting characteristics, so the curd made with rennet or pepsin is supposed to be softer. Because lipolytic enzymes adsorbed on the extra surfaces provided by the more numerous tiny fat globules hydroly fat, homogenized milk or cream may become rancid more quickly than untreated goods. The milk or cream must be pasteurized either right before or right after homogenization to prevent these changes. Usually, the milk is homogenized after main heating and then pasteurized. Driven via a small valve against hard surfaces, heated milk is under pressure of 2500 psi and in a second stage under 500 psi. With a 1/10000 inch diameter, the aperture the liquid is driven through is quite small. Mechanical force milk through a narrow passage at high speed produces homogenized milk. This produces a stabile fat emulsion and breaks down the fat globules in milk into considerably smaller ones. Homogenization reduces the inclination of the fat globules to cluster and merge into cream. Milk is an emulsion whereby fat globules are distributed across a constant skim milk phase. Raw milk left to sit will finally cause the fat to climb to the top and form a cream layer. By means of a small opening under high pressure, homogenization mechanically breaks down the fat globules. While increasing their number and surface area, this lowers the average size of the fat globules. Practically speaking, the net effect is a substantially decreased inclination for creaming of fat globules. The homogenizer consists of a high-pressure pump with an adjustable opening based on a minute orifice. High pressure force of fluids through the orifice causes a notable change in the physical characteristics of the treated product and generates a very intimate combination of the fluid components. 15.1 Introduction
Milk is a multifaceted physiological fluid that aids infants in their transition to life outside the womb by supporting digestion and development, as well as providing essential nutrients and bioactive components. It promotes the development of beneficial microflora and enhances the growth of lymphoid tissue. Recent research indicates that the quantity and importance of bioactive compounds in milk may be greater than previously believed. Through research, the distribution and presence of essential components in various animal milks have been analyzed. The consumption of dairy products has been linked to health benefits that mitigate the adverse effects of obesity and overweight. These benefits include a decreased likelihood of being underweight, reduced blood pressure, and a reduced risk of stroke, colon cancer, and osteoporosis. Dairy products provide a valuable combination of nutrients, such as proteins, fatty acids, vitamins, and minerals, that are essential for the maintenance of blood health, the support of the nervous and immune systems, the improvement of vision, the support of muscle and nerve function, the maintenance of skin health, the maintenance of energy levels, and the overall growth and repair of the body. Furthermore, dairy products can function as carriers for bioactive compounds and may provide a variety of health benefits, such as improved immune function, reduced risk of cardiovascular disease, reduced bone mass loss, and protection against free radical damage, when consumed in an appropriate quantity. Incorporating fruits and vegetables in a variety of forms—including fresh, desiccated, powdered, juiced, pureed, pulped, or extracted—into dairy products such as yogurt, ice cream, and cheese also presents an opportunity to improve their health benefits.

23.1 Introduction
Various products can also be produced by emulsions that contain fat globules. For instance, cream is produced when milk contains concentrated fat. This cream can be further processed to produce butter, ghee, and butteroil. “Milk fat, ghee, butter oil, anhydrous milk fat, and anhydrous butter oil are fatty products that are exclusively derived from milk or products obtained from milk, or both, through processes that result in the almost complete removal of water and milk solids, not fat.” The method of manufacturing (FSSAI standards) has notably influenced the flavour and physical structure of ghee.

23.2 Types of Fat Rich Dairy Products
23.2.1 Cream or Malayi
“Cream is a yellowish component of milk that naturally rises to the surface when milk is allowed to stand. It is rich in fat globules.” Cream is mechanically separated in the dairy industry. The size of the fat globules is diminished as a result of homogenisation of cream, which renders the product less suitable for whipping.
Cream can be defined as
1. That portion of milk, which is rich in milk fat
2. That portion of milk into which has been gathered and which contains large portion of milk fat
3. When milk fat is concentrated into a fraction of the original milk that portion is called cream.

27.1 Introduction
Processed organic food typically consists of solely organic ingredients. If there are any non-organic components, a specified proportion of the food’s plant and animal ingredients must be organic, and any non-organic ingredients must meet specific agricultural standards. Organic foods should not contain artificial additives and are usually processed using fewer synthetic methods and materials, avoiding practices like chemical ripening, food irradiation, and genetic modification. While synthetic pesticides are prohibited, non-synthetic pesticides are permitted. Milk from cows—or any other animal—serves as a useful environmental indicator for measuring pollutants and pesticides because substances consumed by the animal end up in the milk it produces. If contaminants are present in the grass, they will ultimately be found in the milk.

Q fever : Q fever is caused by a rickettsia like organism (RLO), a parasitic organism falling between bacteria and viruses. Xanthan / Xanthan gum : It is a polysaccharide that is produced by fermentation of carbohydrates by a gram-negative bacterium (Xanthomonas campestris) and is a thickening and suspending agent used in pharmaceuticals and prepared foods. It is also called xanthan. Xanthan is a stabilizer produced by Xanthomonas compestris. Xanthan is not hydrolysed or degraded by humans.

A sustainable and healthy food system is one which can provide food and nutrition security for all, in an economical way which is socially and environmentally sound for future generations. Underutilized indigenous and traditional crops can support and strengthen the existing food system, as they are in particular economical and friendly with the environment. Several underutilized indigenous and traditional crops are nutrient dense and adapted to marginal conditions, suggesting that they could be used to champion sustainable and resilient agriculture and food systems for smallholder farmers residing in these environments. The mainstreaming of underutilized indigenous and traditional crops and foods should be recognized for their attributes to make them desirable and to conserve them. In this regard, the fact that value chains for underutilized indigenous and traditional crops are poorly developed at present has created many opportunities to diversify the current food systems. This will create a new employment, market and distribution opportunities.It will also help to combat poverty. It will be if the smallholder farmers and women in rural areas are given the opportunity to utilize underutilized indigenous and traditional crops and re-enter the manistream system. A significant role which is played by the women for the production and conservation of underutilized indigenous and traditional crops offers opportunities for women empowerment through their inclusion in the food system. Promotion of gender equality and empowerment of women is directly linked for strengthening the sustainable food systems that can fight hunger and malnutrition and improve the lives and livelihoods of rural populations. The mainstreaming of underutilized indigenous and traditional crops into the food system would support women to diversify in a sustainable way, feed their own households and to provide nutritious food into the local markets. Food preservation has evolved from traditional household practices to an interdisciplinary field incorporating microbiology, biochemistry, engineering, biotechnology, packaging, nanotechnology and digital intelligence. Bacteriophage is the term applied to bacterial viruses. Bacteriophage having the ability to lyse certain sensitive living cells. Phages are small particles, which can only be seen in the electron microscope after the application of suitable staining techniques. All phages have a head and most have a tail. The head may be isometric or prelate with a hexagonal outline.

There are two types of phages virulent and temperate which enter a different relationship with the host, the lytic and lysogenic cycles respectively.

Tuberculosis

Tuberculosis has been recognized as one of the most important infectious diseases in the world because of its high global impact and its chronic debilitating character, particularly in the poor section of society. Milk-borne tuberculosis is directly or indirectly related to the consumption of raw milk from infected dairy herds.

Normally raw milk contains different levels of inhibitory substances, which restrict the normal development of bacteria and some times may even kill them. The degree of inhibitory activity varies considerably in milks of different species, viz, cow, buffalo, human. Maximum activity present in human milk, variations occur in the milks of individual animals and some times even at different milking or from different quarters of the udder of the same animal.
There are two groups of antimicrobial substances present in milk:
    1.    Inherent or naturally occurring substances in milk. 
    2.    Non- inherent compounds secreted into milk from other sources.

The lack of mechanistic understanding of probiotic activity is a major drawback for the prediction of safety of probiotic intervention. The complex gut-associated microbial ecosystem and nutritionally related factors are the most important environmental triggers for the development and modification of chronic degenerative diseases including immune and metabolic pathologies. In fact, the interaction between the gut microbial ecosystem and the host is considered to be a critical factor in overall health or disease. Whether probiotics will exert protective, harmful, immune-stimulating or immune-suppressing effects on a host is dependent on the interaction between the microbial signals, the genetic make-up of the host and the effects by the environment. Many studies have revealed that certain probiotic bacteria stimulate immune cell proliferation and activity as evidenced by the production of cytokines and antibodies, thereby enhancing the effectiveness of the immune response against pathogens. Ng et al. (2009)

Antibiotic Resistance and Gene transfer
 
It is important that probiotic strains should be assessed for their phenotypical antibiotic resistance and potential to transfer resistance gene as otherwise they cannot be used in food (BgVV, 2000; Vankerckhoven et al., 2008). It is vital to do research on characterization of acquired resistance mechanisms and transferability of resistance genes and on methods for determining transferability.

In spite of the problems with dosage and viability of probiotic strains, a lot more work is required for industry standardization and safety issues. However, it is noted that probiotics have considerable potential against many pathogenic and other diseases. A wide range of clinical trials are still needed to standardize and optimize the conditions. Ongoing basic research will continue to identify and characterize existing strains of probiotics, identifying strain-specific outcomes, determine optimal doses needed for certain results and assess their stability through processing and digestion.

    3.    Food process engineering can also be defined as “the science of conceiving, calculating, designing, building, and running the facilities where the transformation processes of agricultural products, at the industrial level and as economically as possible, are carried out.

    4.    In a discontinuous operation the raw material is loaded in the equipment; after performing the required transformation, the obtained products are unloaded. These operations, also called “batch” or “intermittent,” are carried out in steps:

    1.    Water activity (a_w) affects food chemistry and can be controlled by removal (dehydration or drying) or by chemically binding the water, reducing its activity. Water activity in foods ranges from 0.95 to 1.00 in fresh meats and vegetables to 0.20 in dried milk.

    2.    Water activity (a_w) may be defined in a number of ways, qualitatively, aw is a measure of unbound, free water in a system available to support biological and chemical reactions.

    3.    Water activity, not absolute water content, is what bacteria, enzymes, and chemical reactants encounter and is affected by at the micro environmental level in food materials.

    4.    Two foods with the same water content can have very different aw values depending upon the degree to which the water is free or otherwise bound to food constituents.

    5.    The term “water activity” is related to relative humidity. Relative humidity is defined as the ratio of the partial pressure of water vapour in the air to the vapour pressure of pure water at the same temperature.
