15.1 Introduction

Color of food is the most sensitive part of any commodity as it is the one of the organoleptic characteristic to be noticed and one of the main ways of visually assessing a food before it is consumed. The people associate certain colors with certain flavors and the color of food can influence the perceived flavor in anything from confectionary to beverages. For this reason, food manufacturers add dyes to their products. Sometimes the aim is to simulate a color that is perceived by the consumer as natural, such as adding red coloring to glace cherries, but sometimes it is for effect, like the green ketchup that was launched by Heinz in 2000. If the flavor of a food product is inconsistent with the color, the flavor can often be perceived incorrectly, for example an orange flavored drink colored green could be perceived to taste of lime. In addition, the color of a food substance is important indicator of its freshness. While all of us are aware that food with bright or unnatural colors likely contains food coloring but only few people know that natural foods such as oranges and salmon are sometimes also dyed to mask natural variations in color. The color variation in foods throughout the seasons and the effects of processing and storage often make color addition commercially advantageous to maintain the color expected or preferred by the consumer. The growing concern over the environmental impact of traditional packaging has led to increased interest in biodegradable and edible packaging solutions. These innovative approaches offer sustainable alternatives to conventional materials like plastic, which can persist in the environment for hundreds of years. Biodegradable packaging decomposes naturally, reducing pollution and landfill waste, while edible packaging provides an additional layer of sustainability by allowing consumers to eat the packaging along with the food) These solutions not only address waste management issues but also respond to changing consumer preferences for environmentally friendly products. According to Li and Tian (2012) a pure-culture planktonic growth of bacteria is rarely found in natural environments.There is a physical interaction between the bacterial cells in biofilms (Kolenbrander, 2002; Watnick and Kolter,2000).The bacteria can organize into groups and can form well-organized communities. They also communicate for coordinated activities (Davey and O toole,2000; Watnick et al., 2000; Nadell et al., 2009). Quorum-sensing mechanisms are common in prokaryotic and single-celled eukaryotic organisms like fungi (van Bodman et al, 2008; Sordi and Muhlschlegal, 2009). For any biofilm structure to develop a high level of cell density is important (Kolenbrander et al., 2002; Kuramitsu et al., 2007 and Webb et al., 2003) and also for checking the effect of antibiotics against planktonic organisms in exponential growth phase using MIC and MBC.This can predict the antibiotic efficacy against rapidly dividing bacteria in acute infections. Biofilms play an important part in biotechnology, immunology, biofouling and biodeterioration (Fleming and Wingender, 2001; Dunne, 2002). When the pathogenic cells adhere to the surface, it has been found that the transcription of the EPS genes get stimulated (Dunne, 2002). If EPS gene expression are monitored it can provide a good understanding of biofilm phenotypes (Allison and Sutherland, 1997; Helm and Naumann, 1995; Petersen et al., 2005). EPS serves many functions. It also enables the bacteria to capture nutrients (Pontefract,1991).The formation of biofilm goes through a mechanism which is different from species to species. Even the matrix thickness can be different from 0.2 to 1.0pm depending on the species and doubling time of the cells as thickness of 10 to 30 nm has been found in some bacteria species (Sleytr,1997). The cells secrete polysaccharides, proteins, nucleic acids and glycoproteins. Adherence on solid surfaces by microorganisms is a very complicated process that depends mostly on extracellular molecule production (Czaczyk and Myszka, 2007). The biosynthesis of EPS provides an optimal environment in which genetic material between the cells can be exchanged. This is needed for cell identification and the antigenic properties are helpful in serological characterization of the cells. Among the various compounds of extracellular carbohydrates are acetate esters, pyruvtes, formates, succinates, polysaccharides and proteins (Sutherland, 2001a).

Microbial life abounds on a solid substrate. Water and some nutrients are sufficient to allow the microbial construction called biofilm. Biofilm-associated infections (BAI) can enhance chronic infections in which the bacterial pathogens can persist causing cross-contamination of the food products.

Giaouris et al. (2014) worked on the meat processing and biofilm formation by foodborne bacteria. Work on seafoods has been well worked by Mizan et al. (2015). Habimana et al. (2010) studied them in feed industry on Salmonella versus host resident flora strains. Lin et al. (2017) have studied the characteristics of some food borne pathogens. In a study by Rao et al. (2020) cold atmospheric plasma can be a solution to prevent biofilms.Ferriol-Gonzalez et al. (2020) worked out that bacteriophages can be helpful to remove biofims. According to Przekwas et al. (2020) in early stage of growth of the biofilm use of ascorbic acid can be helpful for the removal of biofilms. Apples can be protected from pathogenic bacteria by protecting them using harmless bacteria. It leads towards the development of alternative foodborne-pathogen-control strategies. Listeria monocytogenes is a big concern in the NE part of India.

Joana et al.(2016) have written a critical review on biofilms and have discussed newer methods to study biofilms. These have given a deep knowledge on the physiology, structure and composition of biofilms. More polar amino acids were present in ABPs but QSPs were made up of higher number of neutral amino acids.This helps in recognition. Introduction

Biofortification is the development of nutrient dense staple food crops using the best conventional breeding practices and modern biotechnology, without sacrificing agronomic performance and important consumer preferred trait (Nestel et al., 2006). It provides a comparatively cost-effective, sustainable, and long- term means of delivering more micronutrients (Saltzman et al. 2014). This approach not only will lower the number of severely malnourished people who require treatment by complementary interventions but also will help them maintain improved nutritional status. Moreover, biofortification provides a feasible means of reaching malnourished rural populations who may have limited access to commercially marketed fortified foods and supplements. Micronutrient malnutrition (MNM) is the major constrain to provide nutritional security to world population of underdeveloped and developing countries. Among the 20 major risk factors of the global burden of disease estimates, Fe deficiency ranks 9th and Zn deficiency ranks 11th, while in the high mortality countries, including India, they rank 6th and 5th, respectively (WHO 2002).

Due to inadequate intakes of vitamins and minerals, half of the world's population suffers from micronutrient malnutrition. An adequate amount of wholesome as well as diverse foods are required for the proper growth and development. In addition to calories requirements, these foods should provide various nutrients. In India, ~70% of children do not get the required calories either due to lack of enough food or diverse food. This indicates that these children are also incapable of fulfilling their protein, minerals and vitamins requirements. Diets that lack diversity can be deficient in certain nutrients. Due to the micronutrient composition of the soil of a region, or because of the intrinsic insufficiency of the normal diet the staple foods of some region can lack particular nutrients. The individual plant foods are often deficient in certain nutrient components due to the varying level and composition of food nutrients in different food crops. Some crops are rich in one component but low in other. For example; legumes are usually high in protein, but deficient in essential amino acids like methionine whereas, wheat and rice are rich in carbohydrates but contain little essential amino acid such as lysine, iron, and lack provitamin A. Relying on a single food crop as major staple source of nutrients thus will not attain a nutritionally complete diet and result in malnutrition and deficiency diseases, which often occur in populations of developing countries, mainly due to poverty. Globally, over one billion people are undernourished and food security is a major issue with the world's population forecast reaching to nine billion by 2050.

1. Introduction According to the United Nations Food and Agriculture Organization, 780 million of the estimated 792.5 million malnourished people globally are in countries that are developing. Despite expanded agricultural production, “hidden hunger,” which is often caused by a shortage of vital micronutrients in daily meals, affects around 2 billion people worldwide. Majority of the population is relying on plant-based diets which are critical for sustaining nutritional security and are the primary source of nutrients required for optimal growth and development. Most of these diets are found deficit in major nutrients such as proteins, iron, calcium and Vitamin B12.However, a considerable number of Asian and African populations suffer from nutritional inadequacies as a result of consuming plant-based diets (Tripathi et al., 2019). Earlier, the main concern of farming systems was crop productivity and yield. However, there has been a shift in emphasis toward human health and well-being.

Abstract

Bioinformatics is a field of science which studies biology, computer science, and information technology. The ultimate goal is to obtain useful information by data acquisition, analysis and interpretation of sequences data. In the current decade, a huge volume of sequence data is stored in the data bank due to global genome initiatives of many organisms. Management and understanding of the genome data cannot be possible without the bioinformatics tools. A large number of tools and softwares packages are available either commercial or freely online for the bioinformatics applications. The use of bioinformatics tools enhances the research capability for crop improvement through genome sequencing, database management, assembly, alignment, primer designing, markers development, genes prediction and annotation, gene expression, phylogenetics, protein structure identification, metabolic pathways analysis and many other applications.

Introduction

Biological activation of grain or germination is a natural, biological processing techniques and traditional method that can be used to improve the nutritional, functional, and sensory properties of grains. During biological activation of grains, extensive phytochemical changes were reported in a variety of food grains, which reflects a dynamic and complex nutrient flux including remobilization, degradation and accumulation. During this process many hydrolytic enzymes were activated to hydrolyze the starches, proteins and, non-starch polysaccharides, which results in more oligosaccharides and free amino acids. Many nutrients and bioactive compounds reportedly increase and then decrease as they are utilized by the growing plant, which results in degradation of the high molecular weight polymers for generation of bio-functional substances. The biological activation of grains also realizes a significant growth of nutritional value by increasing the bioavailability of nutritional compounds, vitamins, bio-elements and other biologically active substances due to the partial hydrolysis of starch, proteins, hemicelluloses and even celluloses. Biological activation triggers the enzymatic activity in grain and dormant hydrolytic enzymes are activated, breaking down starch, fibers and proteins and leading to an increase in the amount of digestible compounds along with improvement of functional properties without any chemical modification. Also, the activity of some anti-nutritional factors (enzyme inhibitors, haemagglutinins, anti-vitamins etc.) decreases or disappears during activation, allowing a complete valorization of biological compounds in grains. During biological activation hydrolytic amylase enzymes, proteolytic enzymes, and catalase were activated in grains, which enhances the starch degradation, a complex biochemical process and thus lead to the conversion of insoluble granules to soluble starch and dextrin. Apart from positive shifting in the level of nutrition, biochemical activities which occur during activation also generate bioactive components of health-promoting activities through the enzymatic actions that are antioxidants in nature, such as ascorbic acid, tocopherols, tocotrienols and phenolic compounds, thus resulting in an increase of antioxidant activity.

Introduction

Humans have primarily consumed "meat/meat products based on where they lived and how they evolved. According to Food Safety and Standards Act 2006, “meat means fresh meat, poultry and game meat which could be in the form of whole pieces, cuts or comminuted (minced etc.), whereas, meat products are those that have been processed by various methods so that they no longer resemble fresh meat”. These products include meat, poultry, and game products in whole pieces or cuts that are cured salted and dried, processed by non-heat treatment, fermented non-heat treated products, heat treated or frozen products. Edible casings used for sausages etc. also come in the category of meat and meat products. Through a notification dated 12^th September, 2017, the FSSAI has included domestic rabbits (Oryctolagus cuniculus) in the Food Safety and Standards (Food Products Standards and Food Additives) Regulation 2011 in the regulation under meat and meat products.

With the advent of globalisation, there has been an increase in food trade which has led to the introduction of exotic meat and meat products. Moreover, rapidly growing economies like India, now demonstrate a growing appetite for meat. As the consumer demand for high quality meat is increasing in most countries, the meat industry should consistently produce and supply quality meat that is safe and healthy for the consumer to ensure continued consumption of meat products.

Biological nitrogen fixation (BNF) is a critical ecological process carried out by grain legumes, which form symbiotic associations with nitrogen-fixing bacteria, primarily Rhizobium species. This natural mechanism converts atmospheric nitrogen (N2) into ammonia, a form that plants can readily utilize, significantly enhancing soil fertility and reducing the need for synthetic nitrogen fertilizers. The process begins with the recognition and infection of the legume roots by rhizobia, leading to the formation of specialized structures called nodules, where the bacteria convert atmospheric nitrogen into ammonia through the enzymatic action of nitrogenase. The symbiosis between legumes and rhizobia is tightly regulated by various genetic and environmental factors, including plant signalling molecules, soil conditions, and nutrient availability. Grain legumes, such as soybeans, chickpeas, and lentils, play a vital role in sustainable agriculture by improving soil health, promoting biodiversity, and providing a protein-rich food source. This overview explores the molecular mechanisms underlying BNF, the factors influencing the efficiency of this process, and its potential to enhance sustainable agricultural practices. I. INTRODUCTION

The fruits and vegetables we eat and flowers and ornamentals we enjoy are biological entities. They breath, produce heat, perspire, are easily damaged, get diseases and finally die. These carry on processes characteristics of all living things before or after harvest to perform the metabolic activities:

2. to transport metabolites around the tissue and
3. to maintain membrane permeability.

1. INTRODUCTION

Packaging waste forms a significant part of solid waste and has caused increasing environmental concerns, resulting in strengthening of various regulations aimed at reducing the amounts generated. A wide range of oil-based polymers is currently used for packaging of various products by different industries including the food industry. These are virtually non-biodegradable and some are difficult to recycle or re-use as they are complex composites having varying levels of contaminants and pose serious health concerns. In the recent years, the use of bio-based and biodegradable products as packaging material has generated a lot of interest amongst researchers as they bring out a significant contribution to sustainable development with a wider range of disposal options.

Bioplastics are polymers that are capable of undergoing decomposition into CO₂, H₂O and inorganic compounds or biomass through predominantly the enzymatic action of microorganisms. Some of these polymers can also be compostable, which leads to their decomposition in a compost site at a rate consistent with known compostable materials. The market for these environmentally friendly materials is expanding rapidly, at the rate of 10–20 per cent per year. The global market for biodegradable polymers exceeds 114 million pounds and is expected to rise at an average annual growth rate of 12.6 per cent to 206 million pounds by 2020.

Bio-based packaging materials are mostly used to pack short shelf-life products, like fresh fruits and vegetables, and long shelf-life products, like pasta and chips, which do not require very high oxygen and/or water barrier properties. However, the inventory of films shows a wide variety in properties, which could make them applicable as a packaging material for other food products with stricter conditions, like MAP packaging. One of the challenges faced by the food packaging industry in its efforts to produce bio-based primary packaging, is to match the durability of the packaging with product shelf-life. The bio-based material offers great potential for the packaging industry. However, it is important to realize that a thorough evaluation of the functional properties of a bio-based material is essential before it can be used as an alternative for the traditional film materials.

14.1 Introduction

Proteins are the substances formed from nitrogen containing amino acids and are principle structural components of body tissues and muscle. In addition, they are used to produce various hormones, enzymes and hemoglobin in human body. Due to the shift from agricultural to electronics and other fast paying industrial development, most of the countries around the world, ceased to be self-sufficient in their food production in particular protein, which is necessary to satisfy their optimum food demands. The biotechnology development and its usage to agriculture have brought hope to them. The need for food by modernization of agriculture has gained much attention throughout the world. However, the necessity for exploring unconventional and non-agricultural means of food production, especially of proteins rich food, cannot be over-emphasized due to the tremendous growth of human populations in several regions of the world. In addition to this, the importance of protein in food nutrient cannot be put aside because its shortage causes various malnutrition problems and the most lethal malnutrition problem is Protein-Energy-Malnutrition (PEM). The United Nations Food and Agriculture Organization estimates that nearly 870 million people of the 7.1 billion people in the world, or one in eight, were suffering from chronic undernourishment in 2010-2012. There are 925 million people undernourished in developed countries (FAO October, 2010). This situation has created a demand for the formulation of innovative and alternative proteinaceous food sources having high nutritional value. These sources have to be non-competitive with food for human consumption, economically feasible and locally available. This demands a search for new protein sources, with high nutritional value, economically feasible and locally available. Use of microbes as a food source is one of the biotechnological innovations that will certainly increase the availability of affordable protein in the world to solve the global food and feed problems.

In recent decades there has been an increased interest in the industrial production of microbiological protein for use in both human and animal nutrition. The main reason behind it is that there has been the shortage of low cost protein sources in view of the increasing human population and living standards, resulting in famine in some parts of the world and increased demand for animal protein in others.

Introduction

Several hazardous chemicals, microbes, and techniques like recombinant DNA technology are used for research and development work in research Institutes and universities. Therefore, the researchers, technical, helping and supporting staffs as well as the laboratory outputs must be kept free from contaminations. Thus, biosafety is necessary to prevent unintentional exposure/ release of hazardous chemicals, microbes/pathogens, and toxins to the laboratory staff and environment. Following the biosafety guidelines and ethical considerations are essential to maintain safety standards for the researchers as well as the environment. This chapter deals with various biosafety measures and ethical issues to be strictly followed while working in a research laboratory. The required safety level needs to be determined as per the chemical/biological materials are used in the laboratory to keep the researcher/environment safe for sustainable research and developmental activities.

Biosafety

The term biosafety is used to describe the procedure and policies needed to ensure environmental and personal safety. Biosafety refers to the containment principles, technologies and practices that are implemented to prevent unintentional exposure to pathogens, toxins, or their accidental release into the environment. A fundamental objective of any biosafety program is the containment of potentially harmful chemical/biological agents as precautionary safety measures.

Why Biosafety?

With the increasing number of countries adopting molecular biology tools and techniques in life science research and development activities, especially in the areas of agriculture and medicine, the biosafety issues are gaining importance to ensure biological safety for the public and the environment. Conducting research in safe and sustainable manner is not only a personal requirement but essential collective efforts to ensure biological safety for a clean and safe environment. This requires rules, regulations, monitoring bodies, and awareness among the workers as well as the public. Therefore, biosafety per se is an integral part of laboratory research and requires awareness among the researchers so that biological safety can be well taken care from the grassroot level.

Abstract

The use of biosensors is growing in the food industry as a means to ensure food safety and quality because of its versatility in determining biological compounds. It is defined as analytical technique used for detection of analyte that combines a biological component with a physico-chemical detector. The most important contribution of biosensors in the food sectors is to control production processes and ensure food quality and safety by reliable, fast and cost effective procedures. Biosensors have been useful for the evaluation of food composition, particularly in functional food products fortified with phytochemicals, vitamins and minerals.. Biosensors are replacing conventional analytical tools since they offer advantages in size, cost, specificity, rapid response, precision and sensitivity. Future progress in the biosensor technology involves the development of nutraceutical release technology within packaging material where it can be used to trigger the controllable release of bioactive components and targeted delivery of protective agents into the food product. The growing consumer demands for safe and quality food has led the food industries to search for quick and reliable methods for which the applications of the biosensor technique in the field of food processing and quality control are found to be promising.

Introduction

The food that we consume should not only contain all essential nutrients like carbohydrate, protein, fat, vitamins, minerals, fibre etc but also should be hygienic and safe. Safety and quality of food is to be ensured not only during food production but also should be continuously monitored till it reaches the consumer (Coles and Frewer, 2013). The characteristics of food are altered during every processing operations viz., cleaning, sorting, transportation, thermal processing, packaging, storage, distribution etc which may be desirable or undesirable. Persistent physical, chemical and microbiological analyses have to be done at all levels of supply chain to ensure the quality of food. Traditional methods of food safety analysis are spectrophotometry, aerobic plate count method, microscopic plate count, titrations, chromatography etc. Though these techniques provide accurate results, the analysis demand cumbersome extraction steps, trained technical staff and are time consuming (Di-Natale et al., 2000). Hence, steady, sensitive and rapid monitoring of food analysis technique is a need of the hour in the present era. Biosensors can effectively replace the conventional techniques owing to its reliability, rapidity, economic and field applicability (Prasad et al., 2014). Biosensors are an attractive diagnostic alternative owing to their in situ detection ability and comparatively reduced detection time from several days to hours, or even minutes (Ruiz et al., 2017). Rapid food analysis can also minimise spoilage, especially in freshly harvested agricultural commodities, such as fruits and vegetables, meat, fish etc. In addition, the portable detection devices provide in-situ detection capabilities without extensive training and assist in integrating real time analysis in food processing centres.

16.1 Introduction

Food safety is most important issue in today's global environment. To safeguard food supply is a very difficult and challenging responsibility, as a consequence of which the world's largest food companies, retailers, and manufacturers have placed very high food safety standards. Although the safety of food has improved exponentially but progress is uneven and food borne outbreaks due to microbial contamination, pesticides, antibiotics chemicals and toxins are common in many countries. International trade statistics (2007) by World Trade Organization (WTO) reported that Europe has accounted for 46% of world exports of agricultural products, where food represents 80% of agricultural exports. The trading of contaminated food among countries increases the risk for outbreaks and consequently, health risks due to microbial pathogens in food are of major concern to all governments.

Biosensors are an important option in the agricultural and food sectors to control production processes and ensure food quality and safety by dependable, fast and cost effective methods. Biosensors have plenty of advantages over conventional analytical tools since they offer advantages in size, cost, inherent specificity, selectivity, rapid response, accuracy and sensitivity. Food microbiologists are always in search of rapid and reliable automated systems for the detection of biological activity. Biosensors provide sensitive, miniaturized systems that can be used to detect unwanted microbial activity or the presence of a biologically active compound, such as glucose or a pesticide. Immunodiagnostics and enzyme biosensors are two of the leading technologies that have had the greatest impact on the food industry. The use of these two systems has reduced the time for detection of pathogens such as Salmonella to 24 hour and has provided detection of biological compounds such as cholesterol or chymotrypsin. The another useful application for biosensors, is detection of genetically modified organisms (GMO), since several countries have laws regulating the commercialization of GMO products and their derivatives. Biosensors are also useful in the implementation of hazard analysis and critical control points (HACCP) plans by verifying process developments and correcting errors in due time. There is joint application of Biosensor technologies and nanotechnologies in many food and agricultural applications such as the development of nano-scale tools for biosafety, nanoscale compounds for food packaging, and nano-sensors for pathogen detection in animals and plants. These are helpful tools in the detection and control of potential food contaminants by the agricultural and food industries.

13.1 Introduction

A surfactant or surface-active agents are the compounds that lower the surface tension between the two liquids or between a liquid and a solid. Surfactants may act as detergents, wetting agents, emulsifiers, foaming agents and dispersants. Surfactants are normally organic compounds that are amphiphilic, meaning they contain both hydrophobic groups or hydrophilic groups. Therefore a surfactant contains both a water insoluble component and a water soluble component. Surfactant will diffuse in water and adsorb at interfaces.

The interfacial free energy is the minimum amount of work required to create that interface and the interfacial tension between two phases is determined as the interfacial free energy per unit area. The interfacial (or surface) tension is also a measure of the variance in nature of the two phases meeting at the interface (or surface). The greater the dissimilarity in their natures, the greater the interfacial (or surface) tension between them. A surfactant is therefore a substance that changes the amount of work required to expand those interfaces. Surfactants usually act to reduce interfacial free energy.

Surface active agents in the form of emulsifiers have a long history of use and are widely used in many products being used in everyday life. An extensive basic research is required to understand the reason of instability and methods to prevent the breakdown of emulsions. Emulsifiers can function as dough conditioners by improving tolerance to variations in flour quality, better gas retention resulting in lesser yeast requirements, increased uniformity in cell size, a finer grain, more resilient texture and improved slicing. Also, the characteristics of freshly baked bread like soft crumb can be retained longer, if the appropriate emulsifiers are added. Commonly used surface active agents in bread production are propylene glycol mono- and diesters, polyoxyethylene sorbitan monostearate, ethoxylated mono- and diglycerides, succinylated monoglycerides and Diacetyl tartaric acid, esters of monoglycerides. Cookie characteristics like top grain, volume and spread ratio can also be improved. Here surfactants used are sodium stearoyl fumarate, sucrose fatty acid esters, sodium stearoyl lactylate, sorbitan fatty acid esters, polysorbates and ethoxylated monoglycerides. In dairy products like Ice cream surface active agents play some important functions like to improve fat dispersion and control fat agglomeration, facilitation of fat– protein interactions, facilitate air incorporation, give smoother texture due to smaller ice crystals and air cells, increase resistance to shrinkage, improve melt-down and reduce whipping time. In candy products, the elimination of “bloom,’’ i.e., the transition of fat crystals is a key reason for the addition of surface active agents. In mixtures of triglycerides, surfactants like sorbitan esters (Spans) and ethoxylated sorbitan esters (Tweens) can control product viscosity in chocolates and in cream fillings and modify the crystal structure. Surface active agents have been utilized in the production of meat analog products also. In margarine, Emulsifiers fulfil several functions like modification of crystal structure in the vegetable fat, assistance in emulsion formation and antispattering. Here, a mixture of citric acid monoglycerides and monoglycerides or lecithin can be used. The properties and mode of action of these chemical surfactants is discussed in the following sections.

Pineapple is a short-stemmed herbaceous plant that necessitates a significant amount of planting material. For example, depending on the intensity of planting and the cultivar used, one hectare of cultivation needs 35,000 to 70,000 planting parts. Realizing the need for quick multiplication, Ma (1968) devised a method for quick pineapple multiplication using the decapitation technique. Later a technique for rapid in vitro propagation has been developed. Since then, numerous reports on crop micro-propagation using tissue culture techniques have been published. On supplemented MS medium, different types of explants, such as leaf base, shoot base, excised lateral buds and tips from crowns, young-leaf segments, and excised leaf buds, have been used to regenerate plants. Banana is also the second highest fruit crop in the world, representing a wide range of varieties of cooking and dessert types, providing a staple, nutritious inexpensive food for millions of people. The word “banana” is a general term embracing a number of species or hybrids in the genus Musa of the family Musaceae known simply as the banana family. Two Musa species namely Musa acuminata and Musa balbisiana, out of the 28 described were first noted in 1865 by Kurz as being the origin of most of the commercial clones (Stover and Simmonds 1987). Cultivated clones are parthenocarpic, mostly sterile with starchy fruits. Indeed, wild types are very fertile; their fruits are full of seeds with little starch, and are seldom fit for human consumption. Its abundance, varietal diversity, availability round-the-year and low cost make banana an important commodity for the religious occasions in many tropical countries. The vegetable bananas, generally grouped under ‘Plantains’ are larger, more angular than dessert type and are generally intended for cooking unripe, although ripened ones are quite like dissert bananas.

Food processing involves the use of wide range of unit operations and technologies to transform the raw, bulky and perishable food into more shelf-stable, palatable and marketable food products. Food processing is one of the most effective solution to reduce the wastages, improves the quality and safety aspects of food products, increase the food availability and marketability. Fruits and vegetables are considered as an integral part of any dietary system as these are rich sources of vitamins, minerals and dietary fibres. India is the second largest producer of fruits and vegetables after Brazil and China which contributes 10 % of world fruit production and 14 % of world vegetable production. Fruits and vegetables are more prone to spoilage as compared to cereals due to their nature and composition. The spoilage can be occurr at the time of harvesting, handling transportation, storage, marketing and processing that results in lot of wastage in the form of seeds, pulps, peels etc. Efficient management of these wastes can help in preserving vital nutrients of fruits and vegetables, and bringing down the cost of production of processed foods, besides minimizing pollution hazards. In India, processing of fruits and vegetables is extremely low as compared to the developed countries.

Biotechnology can help in the bio-processing of fruits and vegetables for the production of novel products having better sensory and nutritional qualities, improved shelf life. Bio-processes involve the use of different micro-organisms and enzymes along with modern biotechnological techniques like genetic engineering.

Introduction

There are large numbers of wheat based products such as fermented pan bread, flat breads including chapati, biscuits, noodles and pasta products. Each product has its own specific requirements. For example fermented pan bread needs wheat with higher protein content, stronger and extensible gluten. Chapati requires hard wheat with high protein content and medium gluten strength. Waxy wheats have been found associated with improved shelf life of breads. White salted Japanese noodles need partial waxy wheats with soft grain characteristics and medium protein content and gluten strength. Partial waxy wheats with comparatively lower amylose content and higher starch paste viscosity improve texture of white salted noodles. Yellow alkaline noodles need comparatively harder wheat with medium strong gluten and without waxy trait. Pasta made from durum wheats requires stronger gluten, high protein content and higher content of yellow pigments. In this chapter detailed account of both fermented and flat breads will be given.

A profit or a loss has not been made, although opportunity costs have been paid, and capital has received the risk-adjusted, expected return.
For example, if a business sells less than 1000 liters of milk each day, it will make a loss, if it sells more, it will be a profit. With this information, the business managers will then need to see if they expect to be able to process and sell 1000 liters of milk per day.

A) Selection of Dairy Cattle

Proper selection is the first and the most important step to be adopted in dairying. Records are the basis of selection and hence proper identification of animals and record keeping is essential. Cross-breed animals with exotic inheritance of about 50 percent are preferable.
 
Bringing animals from different agro-climatic conditions causes problems due to non-adjustment in many cases. In case, purchase becomes absolutely essential it should be from similar environmental conditions as far as possible.

Fermentation is one of the ancient techniques that been routinely used to maintain the quality of food products. This process involves the breakdown of complex substances like carbohydrates into smaller ones which assist in extending the shelf life of food products. Fermented foods and beverages shared the major portion of the human diet which positively affect the body. Beer is a low alcoholic drink in which malt, hops and other adjuncts like aromatic herbs, honey and others are fermented with yeast to obtain a product that offers unique flavour, taste and aroma (Sohrabvandi et al., 2012).

Introduction The world recently celebrated the birth of its eighth billionth baby, a major milestone in the development of the human race and the doubling of our numbers in 47 years. This tremendous growth has been driven by ambitious advances in technology and health care, soaring achievements of global prosperity and a longer life expectancy that has come to a staggering 72 years. However, the glory of these achievements is marred by how we are failing the lion’s share of the global population in meeting their basic requirements. Almost one in seven people on our planet do not have enough to eat. Food and nutritional insecurity are detrimental to human development and are a major brake on overall socio-economic development which downplays any major accomplishments we have made since not having enough to eat is an international security issue. Adequate food production, easy access and the capacity to buy food, relevance concerning nutrition and stability of these elements are all necessary for sustainable food security (Helland and Sorbo, 2014).

1. TERMS RELATED WITH BROWNING

Browntop millet (Urochloaramosa) is a warm-season crop that produces seeds that are heavier than other millet varieties. This crop is cultivated in several types of soils and climates. Browntop millet is an introduced grass that originated in Southeast Asia. It is grown in Africa, western Asia, Arabia, China, and Australia. It was introduced to the United States from India in 1915. It is also useful for controlling erosion, producing hay, feeding wild animals, and producing grain for human use. In addition, it is also utilized as a crop for wild animal food. In dry and semi-arid regions, millets constitute the main food supply. Although India is the main producer of millet, output and use have fallen. Browntop millets are nutrient-dense. Browntop millet is a miracle crop for arid and rainfed areas. Nearly all of the necessary nutrients are found in browntop millets.

1.1 Introduction In parallel with the expansion of organically cultivated land and low-input agricultural system, there is an increasing demand for crops that have promising potentials to be grown successfully in these systems. Buckwheat is generally sown in smaller areas, which may be found suitable for low-input agricultural systems. Buckwheat is a fast-growing crop with a variety of utilizations. Buckwheat, one of the pseudo and minor-cereals, has the ability to satisfy the rapidly rising population’s ever-increasing food need in the nation’s hill regions in the context of changing climatic conditions. It is also known as common buckwheat or Fagopyrum esculentum, it is not a cereal grain, but rather a seed that is related to rhubarb and sorrel. It has a unique nutty flavour that makes it an excellent ingredient in a variety of dishes. It is known in India by a variety of names, including ogal, phaphar, bresha, mittahe dyat, dro, and brotitae.

9.1. Onion (Allium cepa L.)

The onion (Allium cepa), which is also known as the bulb onion, or common onion is the most widely cultivated species of the genus Allium. It has been used as food since time immemorial and is an important vegetable all over the world. The genus Allium also contains a number of other species variously referred to as onions and cultivated for food, such as the Japanese bunching onion (A. fistulosum), Egyptian onion (A. proliferum), and Canada onion (A. canadense). The vast majority of cultivars of A. cepa belong to the “common onion group” (A. cepa var. cepa) and are usually referred to simply as “onions”. The Aggregatum Group of cultivars (A. cepa var. aggregatum) includes both shallots and potato onions. Onion is suggested to have been originated in Asia, particularly Pakistan and Iran.

China is the largest onion producer in the world followed by India. Largest area under onion is in India followed by China. The major onion producing state are Maharashtra, Karnataka, Madhya Pradesh, Rajasthan, Gujarat, Bihar, Andhra Pradesh, Tamil Nadu and Orissa.

Introduction

In simple terms, business refers to buying and selling of products. Business would define itself as an organized effort through companies aimed at supplying consumers with products and services in a return for monetary compensation. However, this simplistic definition is insufficient to assess the impact of the environment on modern international business operations. For easy understanding, modern business can be explained as a complex field of industry and commerce involving activities associated with both production and distribution. These activities cater to the wants and desires of society at one extreme and provide profit for business firms at the other.

Indian leaders, particularly the first Prime Minister Dr. Jawaharlal Nehru, who had conceived the theory of five year plans, had regarded high economic growth and higher income among poor population as the foremost objectives before the newly independent nation. To achieve these objectives, government was made to play a very important role, and since 1951, a series of five year plans have been the driving forces behind the economic prosperity of the country. Despite of experiencing growth in 1950s, it was still lower than that of many Asian countries. Between 1951-79, the Indian economy had grown at an average rate of 3.1 percent a year at constant prices. 17.1 Introduction
Butter is a fat concentrate that is produced by churning cream to create a solid bulk, which is subsequently processed. The table creamery butter is produced from the cream or coagulate of cows or buffaloes, or a combination of the two. It may contain common salt and natural colorants such as annatto or carotene, but it should be devoid of other animal lipids, wax, mineral oils, and vegetable oils and fats. The only permitted additives are common salt and natural colorants (annatto and carotene), with no preservatives permitted.. The butter must contain a minimum of 80% milk fat, no more than 1.5% curd, and no more than 3% sodium measured by weight. Diacetyl may be incorporated for flavoring purposes; however, it is prohibited from exceeding 4 ppm. Calcium hydroxide, sodium carbonate, and sodium polyphosphate are permissible additives, provided that their combined weight does not exceed 0.2% of the butter’s weight.
17.2 Classification
The market supplies a wide variety of butter varieties. This varies depending on the kind of cream used in their production as well as other factors. The varieties of butter are:
1. Pasteurized cream butter: Usually made from sweet cream that has been pasteurised. However, this kind of butter has a milder flavour than the same kind of cream that hasn’t been pasteurised.
2. Ripened cream butter: Butter is produced through adding butter culture to cream and incubating it until the desired acidity and flavour are achieved. Authentically made ripened cream butter possesses a mild
flavour commonly known as ‘real butter flavour’.
3. Unripened cream butter: Created from fresh, unripened cream.
4. Salted butter: Butter with added salt.
5. Unsalted butter: Butter without any added salt.
6. Sweet cream butter: Butter made from cream with an acidity level not exceeding 0.2%.

The 20^th century had seen unprecedented increase in fishing capacity; in terms of the vessel number, increase in size of the vessels and advances in the electronic and navigational equipment coupled with easily manufactured and durable fishing nets. The effect of these innovations sequentially, was the burgeoning in the fish production, plateauing of catches and the myth of inexhaustibility of fishery resources in the sea was proven wrong. A large number of stocks world over have declined and the stock status of many are now alarming, but still the trend towards larger, more powerful and faster vessels continues.

Global fisheries production has reached a plateau and is now hovering around 80 million tonnes during the last decade. It is also noted that the status of world’s marine fish stocks have not improved overall. About 31.4% of assessed fish stocks are fished at a biologically unsustainable level and therefore overfished. Fully fished stocks accounted for 58.1% and underfished stocks 10.5%. It is evident that most of the stocks are fully fished with no further potential for increase in production.

The importance of reducing bycatch and minimizing ecological impacts of fishing operations has been emphasized by scientists and fishery managers and recognized by fishermen. Trawl fisheries in different parts of the world are now being required to use bycatch reduction devices as result of pressure from conservation groups and legal regimes introduced by the governments. The Code of Conduct for Responsible Fisheries (FAO, 1995), which gives guidelines for sustainable development of fisheries, stresses the need for developing selective fishing gears in order to conserve resources, protect non-targeted resources and endangered species. Although the problems of using non-legal gears and designs often with smaller mesh sizes are reported. Most of the problems due to generation of bycatch and damage to the ecosystem function, has been implicated due to trawling.

Introduction

The economic choice of any process is the criterion for efficient utilization of the by-product that is produced along side of main product. During manufacture of major dairy products, the dairy industry also ends up in producing different by-products. Various by-products of dairy industry are skim milk, butter milk , whey and ghee residue. Dairy industry is particularly confronted with the problem of economic utilization of whey and ghee residue. The techno-economical problems associated with utilization of these by-products, is now receiving considerable attention. More efficient, cost effective and sophisticated technologies have opened up new vistas for manufacture of number of derived by-products. Further more the market for dairy by-products, as an ingredients in other consumer food products like snacks, ready meals and microwavable food products, has been growing.

C - enamel can: The sulphur resistant lacquer is golden coloured and the can coated with it are called C-enamel can or sulphure resistant can, used for packing non acid products (Plate 143).

CA storage: Storage of commodities under gaseous atmosphere like gas storage, where the composition of atmosphere is controlled accurately. MA and CA differ only in degree of control and CA is more exact. These storage methods in combination with refrigeration markedly enhance storage life of fruit and vegetables (Plate 144).

CAC: It stands for Codex Alimentarious commission (1962). It is a joint commission of FAO and WHO, comprising of 146 member countries. It ensures consumer food safety, establish fair practices in food trade and promote the development of international food standards. CAC make standards for food additives, veterinary drugs, pesticide residue and other miscellaneous substances that affect consumer safety. These are published in Codex Alimentarius.

Accurate mix calculation is essential for achieving the desired composition, quality, cost, and regulatory compliance of ice cream. This chapter introduces methods used to calculate formulations based on fat, milk solids-not-fat, sugar, total solids, and other components. It explains the Pearson’s Square method, serum-point calculations, simple mix calculations, and least-cost formulation approaches. The chapter demonstrates how mathematical formulation can translate ingredient specifications into a practical manufacturing recipe. Proper calculation helps maintain consistency between batches while controlling ingredient costs and product characteristics. The chapter therefore provides a practical foundation for students, technologists, and manufacturers involved in formulation development, production planning, cost optimization, and quality management.

1. Calibration of Milk Butyrometer

Introduction

Butyrometer is used for determination of fat for milk and milk products by Gerber method. The milk butyrometer is a graduated vessel, which are designed in such a way that the internal volume of each unit is 0.125 ml which is corresponding to 1 percent fat. Sometimes due to manufacturer’s error, the volume of one unit of milk butyrometer is not exactly equal to 0.125 which leads to subsequent error in results in milk fat. So before starting to use a new butyrometer, it is essential to calibrate for its efficiency in the laboratory. Mercury is used to calibrate milk butyrometer.

Apparatus

The term canning refers to a process that involves heating foodstuff in hermetically sealed containers for a specific time at a specific temperature to eliminate microbial pathogens that endanger public health; and microorganisms and enzymes that deteriorate food during storage.
Principle of canning: Destruction of micro-organisms causing spoilage, within the sealed containers using heat.
Canning Process
Preparation of food commodities for canning consists of selection of commodities, washing, sorting, grading, peeling, halving, blanching, filling into cans, filling hot syrup or brine, exhausting, double seaming, Sterilization/ processing, cooling, storage, etc.
Raw material selection
Fruits should be ripe but firm, evenly matured, and free from blemishes, insect damage, and malformation. Apple, pear, peach, and banana harvested at the mature stage are preferred for canning.

Materials Required

Fruits or vegetables, stainless steel knife, steel pans, Can Body Reformer, Flanger, Double seamer, weighing balance, Refractometer / Salometer, sugar or salt etc. 

Procedure

    1.    Wash the selected fruit or vegetable (as the case may be) 
    2.    Cut into pieces or slices (the size and shape may depend on the fruit/ vegetable but it should not be too large or too small)
    3.    Blanch the material in boiling water for 1-2 min for effective inactivation of enzymes. 
    4.    Prepare the sugar syrup of strength 40o Brix or brine of 1-3 % strength.
    5.    Prepare the can body using a can body reformer and flange the ends in a flanger.
    6.    Seal the base plate using first and second roller operations of the double seamer. 
    7.    Transfer the prepared fruits / vegetables into the cans. 
    8.    Pour in hot syrup or brine into the cans.
    9.    Place the lid over the top of filled can. (follow the first roller operation of the double seamer, if the cans are OTS cans)
    10.    Exhaust the cans in boiling water for about 10 min. to exclude any dissolved air out of the tissues or syrup/brine.
    11.    When the temperature of the centre of can reaches 79-80 ºC for fruits or 82ºC for vegetables, remove the cans from the exhaust box and seal them properly (follow the second roller operation of the double seamer, if the cans are OTS can).
    12.    Process the sealed cans at 100ºC and 115-121ºC for fruits and vegetables respectively for 15-30 min in case of fruits and 25-45 min. in case of vegetables.
    13.    Cool the cans immediately in cold water and air dry them at room temperature.
    14.    Label and store in a cool dry place.

Canning : Process of preservation of various food stuffs including fruits and vegetables whole or in pieces, in sugar syrup or brine by heat processing them in hermetically sealed containers.

Introduction
The term canning refers to a process in which the food is heated in hermetically sealed containers at a specific temperature for a specific time to eliminate microbial pathogens that endanger public health; and microorganisms & enzymes that deteriorate food during storage. The credit for the invention of canning goes to a French confectioner Francois Nicholas Appert, who was awarded a prize in 1809 by the French government for developing a new method of heat preservation of food in a sealed container and after whose name the process of canning has also been named as Appertization. In 1810 Nicholas Appert published the first book on canning entitled “The Art of Preserving Animal and Vegetable Substances for Many Years.” which is the first known work on canning. The work of Appert consists of packing food in glass bottles, closing them with corks, and heating the container in boiling water for several minutes depending upon the type of the food. Although the developed technique was used to preserve different types of food, the actual reason for the prevention of spoilage was known only after the work of Louis Pasteur (1864) who discovered that food spoilage was caused by microorganisms that were destroyed at elevated temperatures and the technique was known as Pasteurization. This understanding helped to form a scientific basis for establishing and revolutionizing the canning industry. Canning of fruits on a commercial scale was introduced in the USA in 1817 by William Underwood. The old phrase ‘necessity is the mother of invention’ suits well for the development of the canning industry during wars. The Civil War in America and the Great European War of 1914 also gave impetus to the development of a canning industry to meet enormous requirements of food for the fighting forces.

Canning is a process of sealing food stuffs hermatically in containers and sterilizing them by heat for long storage is known as canning.

Grading

Selected fruit and vegetable are graded according to size and colour to obtain uniform quality. This is done by hand or machines such as screw grader and roller grader.

1. INTRODUCTION

Canopy management is the manipulation of tree canopy to optimize its production potential with excellent quality fruits. In many fruit crops, increase in production with enhanced fruit quality is obtained by managing canopies of short statured trees. Small trees capture and utilize the sunlight properly and results into better fruit production.

The fruit growers desire to regulate the growth and development of their trees in a scientific manner. This is because it is not always wise to allow a plant to develop naturally, since unwanted portions may develop which may affect the production. The removal of unwanted parts of plant is thus known as pruning. The practice of pruning as and when performed in an appropriate manner, keeps the plant in such shape and condition as to yield fruits of desired quality.

Canopy management depends on the nature and growth pattern of plant, number of plants /ha and pruning techniques used by the farmers in their fields. Pruning should be done when trees are young to establish their basic shapes and sizes, and continued as trees mature. Trees that grow too close together shade out the lower canopy portions and in turn decrease their fruit setting. These trees are required to be pruned to allow the light to reach the top and lower sides of trees. Pruning is done either to encourage the growth (thinning) or to reduce the tree size (heading back). Thinning of bearing trees encourages vegetative growth, and removes interior branches, encouraging the outward growth of plants. Heading back reduces the outward canopy growth through topping and hedging of branches.

Cape gooseberry is the native of Peru and Chili (South America), but widely cultivated in Cape of Good Hope and hence called so. It is known by different name in various parts of the world. It is commonly called ‘Poha’ in Hawaii; ‘Golden berry’,’ Pompelmoes’ or ‘Apelliefie’ in South Africa; ‘Lobolobophan’ in the Philippines. In India it is commonly called ‘Rasbhari’, ‘Makoi’, ‘Tiparee’ or ‘Tepari’. Cape goose berry (Physalise peruviana L.) belongs to the family solanaceae. Out of 80 species of genus physalis, only three are well known for their fruit value. These are: (i) P. pubescen L. (ii) P. Peruviana L., and (iii) P. ixocarpa Brot. However these three species, Physalise peruviana L is the most popular due to its pleasant flavour and acid-sweet taste.
