Concentrated milk products are obtained through partial removal of water which increases the dry matter content of milk. The increase in dry matter content in concentrated milk is proportional to the degree of concentration. The milk concentrate may be prepared from either full-cream whole milk or fat-free skim milk.

Depending on the nature of raw material and other non-milk additives concentrated milks are classified into four broad categories.

1. Sweetened condensed milk

2. Evaporated milk or unsweetened condensed milk

3. Sterile milk concentrate

4. Reconstituted concentrated milk

Sweetened Condensed Milk

One of the earliest dairy products to be produced industrially is sweetened condensed milk. According to FSSA (2006), sweetened condensed milk is the product obtained by partial removal of water from the milk of cow/buffalo with the addition of sugar or a combination of sucrose with other sugars or by any other process that leads to a product of the same composition and characteristics. The fat and/or protein content of the milk may be adjusted by the addition and/or withdrawal of milk constituents in such a way as not to alter the whey protein to casein ratio of the milk being adjusted. It shall have a pleasant taste and flavor and be free from off-flavor and rancidity. It shall be free from any substance foreign to milk. It may contain food additives. It shall conform to the microbiological requirement as laid down by FSSA. The said product shall also conform to the following requirements

1.1 Introduction
Concentrated milks, like evaporated milk and sweetened condensed milk, serve as practical substitutes for fresh milk in regions where access to it is limited or where transportation and storage are challenging. These products go through specific processing techniques to reduce their water content, thereby improving their shelf life and transportability. Evaporated milk is created by removing water through evaporation and then
sterilizing it to prevent microbial growth. This process results in a thicker consistency and a slightly caramelized flavor due to the heat treatment. On the other hand, sweetened condensed milk is made by adding a significant amount of sucrose to the milk and excluding oxygen, which inhibits microbial growth. This results in a thick, sweet product suitable for various culinary uses. These concentrated milk products are usually packaged in small cans, making them convenient for storage and transportation. However, they are sometimes diluted before consumption with water to resemble the taste and consistency of fresh milk. In regions where even concentrated milks are not easily accessible, alternatives like whole milk powder or recombined milk are used. These alternatives involve dehydrating milk into powder form or reconstituting milk components to create a liquid similar to fresh milk. Innovations in processing and packaging have led to the development of alternative uses for concentrated milks, expanding their versatility beyond traditional applications. These products continue to provide essential dairy
nutrition in areas where fresh milk is scarce or hard to obtain, offering a shelfstable solution to meet dietary needs.

Chemistry of Creaming

After being drawn from animals, normal milk will form a cream layer on standing. Because of the difference in density between fat globules (920 kg m−3 at room temperature) and milk plasma (density 1030 kg m−3), the granules tend to rise. This causes creaming, which we often want to prevent and it enables milk to be separated into cream and skim milk. Creaming is much enhanced when the globules have been aggregated into flocculates, clusters, or granules.

Cream Ripening

This unit operation serves as an intensive preparation of the cream for the churning process. It is divided into two categories.

1. Physical ripening;

2. biochemical ripening The following criteria are influenced by the cream ripening:

• Consistency, firmness, and spreadability of butter.

• Basic water content of butter during the manufacturing process (bound water in butter, which cannot be removed by any mechanical treatment).

• Buttermilk fat content, which has to be minimized.

The melting and solidification behavior of fat depends on the attached fatty acid, which indicate the hardness of the butterfat.

Natural hardness is caused mainly by seasonal feeding of the milk animals. Winter feed with a great deal of dry feed or roughage yields a hard butterfat with a high percentage of saturated and short-chain fatty acids and few double bonds in the fat molecules.

Summer feeding (green grass) results in fat with longer chains and a higher percentage of unsaturated fatty acids with many double bonds. We therefore distinguish between summer fat and winter fat or summer cream and winter cream.

The process of making dried milk involves eliminating water from milk, primarily through spray or roller drying. It is regarded as a significant sector of the dairy industry and is made from whole cow, buffalo, or standardized milk. Skim milk powder (SMP) is made from milk after the fat has been removed whereas whole milk powder (WMP) is made from whole cow or buffalo milk

FSSA (2006) Standard Of Milk Powder According to FSSA (2006), Milk powder is the product obtained by partial removal of water from the milk of cows and/or buffalo. The fat and/or protein content of the milk may be adjusted by the addition and/or withdrawal of milk constituents in such a way as not to alter the whey protein to casein ratio of the milk. It shall be of uniform color and shall have pleasant taste and flavor, free from off-flavor and rancidity. It shall also be free from vegetable oil/fat, mineral oil, thickening agents, added flavor, and sweetening agents. It may contain food additives. It shall conform to the microbiological requirements prescribed by FSSA (2006).

Water activity, high storage temperatures, longer than usual storage times, high product moisture content, high processing temperatures, and container headspace are some of the variables that affect the Maillard reaction in dried milk.

Casein and whey proteins are the major proteins present in milk. Unlike casein, whey proteins are heat-labile. Whey protein fractions present in milk are α-lactalbumin, β-lactoglobulin, bovine serum albumin, immunoglobulin, euglobulin, and lactoferrin. β-lactoglobulin and κ-casein interact during heat treatment. When milk is refrigerated for longer than 24 h, it forms γ-casein and protease-peptone fractions.

2.1 Introduction
The continuous production of dry milk has become consistently significant within the dairy industry and is expected to continue growing due to its advantageous features. These include improved shelf life, reduced storage
requirements, and lower transportation costs, all of which contribute to favourable economic outcomes.
For example, non-fat dry milk is also known as skim milk powder, dried skim milk, non-fat dry milk solids, or dehydrated skim milk. Similarly, products like dried whole milk, dried cream, and dried buttermilk are often regarded as dried or powdered whole milk, cream, and buttermilk, respectively, based on their specific compositions.

The terms “cultured dairy foods,” “cultured dairy products,” and “cultured milk products” are other terms for fermented dairy products. Lactobacillus, Lactococcus, Leuconostoc, and other lactic acid bacteria, along with yeasts in certain products, are used to ferment milk to make these dairy products. The product’s shelf life is extended through fermentation, which also improves the product’s taste and milk’s digestibility. There is a wide variety of fermented milk products available, each with unique flavors and attributes. The following categories apply to fermented milk products, based on the type of fermentation.

Changes in Nutrients Resulting from Fermentation

Fermentation lowers the lactose content in fermented milk products; however, if the starting milk is concentrated or fortified, the finished product’s lactose content may be higher than that of liquid milk.

The composition and content of protein and total amino acids are comparable to those of raw milk. Casein degradation is small compared to cheese, accounting for not more than 1% of the total protein. While some products of casein degradation are used by the starter microorganisms, others build up as free amino acids in the fermented kinds of milk. The amounts of free amino acids that build up differ depending on the species. Generally, proline is increased in large quantities, followed by serine, alanine, valine, leucine, and histidine. As a result of continuous starter culture activity, the level of free amino acids increases during storage. A limited degree of lipolysis occurs during the manufacture of fermented milk. The amount varies depending on the type of species, but the pattern and concentration of free fatty acids are both impacted. During fermentation and the breakdown of amino acids, trace amounts of volatile fatty acids are also produced.

One of the most consumed and well- known milk products in the Indian subcontinent is ghee. It is a by- product of tradition, prepared both at organized dairy plants and the household level for a well- established market. Ghee is traditionally made from the milk of cows or buffalo. The tetrapyrrole pigments biliverdin and bilirubin are responsible for the distinctive color of buffalo ghee. On the other hand, ghee is golden yellow due to the presence of carotenoids in cow’s milk. Ghee’s composition changes according to the kind and feeding habits of the animal and can differ from place to place and season to season.

In addition to, being a substantial source of fat- soluble vitamins, essential fatty acids, and other growth- promoting components, ghee is a rich source of energy. Its value as food for humans is enormous. Additional attributes related to medicine are present in ghee. Ghee can improve one’s physical and mental attributes and treat eye conditions like ulcers. Ghee is used in religious and ceremonial rites in addition to being consumed.

Composition

Ghee is a complex lipid composed of mixed glyceride which makes up 99–99.5% of its total content. In addition, it has trace amounts of calcium, magnesium, phosphorus, iron, copper, and fat- soluble vitamins, tocopherols, carbonyls, hydrocarbons, carotenoids, free fatty acids, phospholipid, sterols, and sterol esters

4.1 Introduction
Human milk widely acknowledged as the optimal source of nutrition for infants, providing a rich array of components crucial for their growth, repair and development. However, the composition of human milk can vary
significantly within and between feeds, throughout the day, over the course of lactation, and among different mothers and also populations. While this variability is beneficial for infant health and survival, it presents challenges for the management of nutrition of high-risk infants who require precise oversight. The composition of human milk can be altered by factors such as the handling of expressed milk, including how it is stored and pasteurized. Thus, proper management of expressed milk is essential. The recommended practice for infant nutrition is exclusive breastfeeding for the first six months, followed by continued breastfeeding for at least one to two years. Human milk is naturally suited to meet the nutritional needs of infants, providing both nourishment and bioactive compounds that support healthy growth and immunity.
Human milk contains a variety of bioactive components, such as immune cells, anti-infective and anti-inflammatory agents, growth factors, and prebiotics. In contrast to infant formula, which has a fixed nutritional profile, human milk is dynamic and can vary between and within feedings, influenced by maternal factors, environmental conditions, and the methods used for expressing and managing milk.
A thorough understanding of human milk’s composition is vital for effective infant feeding, especially for at-risk infants. It also allows for the assessment of how milk storage and pasteurization may impact its beneficial components. Additionally, some of the bioactive elements in human milk are being studied for their potential use in medical treatments, either as preventive or therapeutic agents.

Commercially, one of the most significant milk products is ice cream. It is a frozen product which is usually made from milk or cream that has been f lavored with fruits like peaches or strawberries, and spices like vanilla or cocoa, or with sugar or a substitute. Stabilizers are sometimes combined with food coloring. Ice cream mix typically contains 10.0% milk fat, 11.0% solids not-fat, 14.0% added sugar, and 0.3% additives like an emulsifier, stabilizer, f lavor, and color substances.

Standard of Ice Cream

According to FSSA (2006), ice cream, kulfi, chocolate ice cream or softy ice cream means the product obtained by freezing pasteurized milk prepared from milk and/or other products derived from milk with the addition of sweetening agents and fruit products, egg products, coffee, cocoa, ginger, and nuts. It may also contain chocolate, and bakery products such as cake or cookies as a separate layer and/or coating. It may be frozen hard or frozen to a soft consistency. It shall be free from artificial sweeteners. It shall have a pleasant taste and smell free from flavor and rancidity. It may contain food additives. It shall conform to the microbiological requirements as given in FSSA (2006).

3.1 Malted Milk
Malted milk, originating from the ideas of British pharmacist James Horlick in the 19th century, was initially marketed under the name “Diastoid” before being trademarked as “malted milk” in 1887. Although initially targeted
for infants and invalids, its appeal expanded due to its nutritional value, convenience, digestibility, and palatability. Recognized globally for its lightweight, non-perishable nature, and high-calorie content, malted milk is
created by evaporating a mixture of malted barley, wheat flour, and whole milk until it forms a powder.
There aremainly two types of malt powder: diastatic and non-diastatic. Diastatic malt containing enzymes breaking down starch into sugar, aiding in dough rise and crust formation, particularly in bread making. Non-diastatic
malt lacks active enzymes and is primarily utilized for flavor enhancement, commonly in beverages. It may also include sugar, coloring agents, and other additives to improve taste and appearance.
3.2 Malting
Malting is a crucial process employed in treating cereal grains, such as barley, by inducing germination through soaking in water followed by halting the process through drying or heating with hot air. This technique encompasses two main stages: sprouting and kiln-drying. The term “malt” encompasses several products of this process:
1. Malted grains: These are grains, like barley, that have undergone the malting process.
2. Malt sugars: These are sugars, predominantly maltose-rich, derived from malted grains, often utilized in baking, such as baker’s malt.
3. Malted milk products: These include beverages like malted milkshakes, made using malted milk.

Being an essential component of the rich Indian past, traditional dairy products and a sophisticated classification of confections have played a significant role in the Indian economy. Depending on how it is processed, it has significant social, cultural, and economic significance. These products have been developed over a long period using a combination of experience, traditional wisdom, and culinary skills. India is emerging as the highest milk- producing country in the world with an annual production of 221.1 million tons in the year 2021–22 (Source: Basic Animal Husbandry Statistics, MoFAHD, DAHD, GoI). An estimated 50% of the milk produced in India is used to make a range of traditional dairy products, including paneer, dahi, ghee, khoa, and shrikhand. The product is not only well- established in the Indian market, but it also has significant export potential due to the large Indian diaspora living all over the world.

All native milk products that have developed over time using locally accessible technologies are referred to as traditional Indian dairy products or Indian indigenous milk products. The Indian masses’ economic, social, religious, and nutritional well- being are greatly influenced by traditional dairy products.

Classification of Traditional Indian Dairy Products

Traditional dairy products in India are typically made, packaged, and/or sold using time- honored methods without the use of machinery or meticulous documentation of the procedure. These products do, however, have several technological advantages, including their widespread appeal, reduced cost of production, straightforward manufacturing process, adoption at the rural level or collection center, large profit margin, and abundance of employment opportunities. These products are categorized according to the manufacturing principle.

Milk is the secretion of the mammary glands of animals. For human consumption, milk is that liquid obtained from the cow or the buffalo during the period following at least 72 hours after calving or until the milk is colostrums-free. It is a complex biological fluid consisting of seven main components: water, fat, protein, sugar (lactose), minerals, vitamins and enzymes. Milk is a white opaque fluid in which fat is present as an emulsion, protein and some mineral matters in colloidal suspension and lactose together with some minerals and soluble proteins in true solution. The opacity of milk is due to its content of suspended particles of fat, proteins and certain minerals. The colour varies from white to yellow depending on the carotene content of the fat. Skimmed milk is more transparent with a slightly bluish tinge. Milk of a good flavour has a pleasant, slightly sweet taste, and no odour. It is an excellent source of calcium, phosphorous and riboflavin. Vitamin A and D are currently added to whole milk, partly skimmed and skimmed milk.

Cherimoya is considered as the most esteemed of the fruits of the genus Annona (family Annonaceae). A. cherimola Mill., because of its limited distribution, has acquired few colloquial names, and most are merely local variations in spelling, such as chirimoya, cherimolia, chirimolla, cherimolier, cherimoyer. The cherimoya is believed to be indigenous to the interandean valleys of Ecuador, Colombia and Bolivia. It is cultivated in Australia, Hawai, Brazil, Mexico, India, Sri Lanka, Jamaica, Spain, Costa Rica, Africa and Argentina. In India it is found growing in states of Maharashtra, Tamil Nadu, (Nilgiris and Palani hills), Karnataka (the Nandi hills) and Andhra Pradesh (Telangana region).

It bears fruits with skin which is thin or thick, may be smooth with fingerprint-like markings or covered with conical or rounded protuberances. The sweet, juicy, white flesh is melting, subacid and very fragrant. The fruit is of a primitive form with spirally arranged carpels, resembling a raspberry. Each segment of flesh surrounds a single hard black bean-like seed.

Cultivars: Fingerprinted, Smooth, Tuberculate, Mammilate and Umbonate are the cultivars having different shapes, texture and morphology.

Uses

The flesh of the ripe cherimoya is most commonly eaten out of-hand or scooped with a spoon from the cut open fruit. It really needs no embellishment but some people in Mexico like to add a few drops of lime juice. Occasionally it is added to fruit salads or used for making sherbet or ice cream. Colombians strain out the juice, add a slice of lemon and dilute with ice-water to make a refreshing soft drink. The fruit has been fermented to produce an alcoholic beverage (Morton, 1987). In Jamaica, the dried flowers have been used as flavoring for snuff. All species of Annona can produce seed oil. Essential oils extracted from soursop (pulp) have industrial applications and the oils are also thought to improve the flavour of processed fruit products.

Chicory (Cichorium intybus L. var. sativum D.C.) plant is the herbaceous, perennial plant and supposed to have descended from the wild chicory (wild succory, blue sailors) which is often seen along roadsides with its blue flowers. The leaves are used as salads in human diet and other different purposes. They were reported to be stomachic (Baumann 1982, Franke, 1981) and their juice was used against eye disease and poisoning. The infusion of chicory was believed to be good for the liver, kidney and stomach. Initially the wild plant was used but since approximately 300 B.C., the crop was cultivated for this purpose. Beverages, soups and sauces made of chicory were reported to be used in Italy and Belgium as early in 16^th century.

For the first time, the root of chicory was used as a substitute of coffee in 1690 in Holland followed by many other countries like Sweden, France, etc. During 1806 and 1813, the cultivation and use of roasted roots of chicory as coffee substitute spread over the whole European continent. In the 19^th century, the main centres of cultivation of chicory were North-East France, Belgium, England, Russia, Holland and Australia. Subsequently it was raised on large scale in Poland, Hungary, Germany, Switzerland and India. Presently over 20% of the World’s consumption takes place in Eastern Europe, especially in Poland (6%) followed by Russia, Hungary, Romania, Czechoslovakia and East Germany. Twelve percent is reported to be consumed in South Africa, 9% in India and 2% in the United States (Clark and Macrae, 1987).

India is today the second largest producer of fruit and vegetable after China with a total annual production of 281.75 million tons in 2017-18. Fruit and vegetables are essential components of the human diet and nutrition constitute. Fruit and vegetable are also element of diversification in agriculture for additional income generating resource and employment generation area. Although India is the largest producer of fruit in the world, the production per capita is only about 100 g per day. Huge losses to the extent of 20 to 40% of the total production are reported due to lack of adequate infrastructure and transportation facilities and higher the transportation cost. Thus the per capita availability of fruits is further reduced to 60 -80 g per day which is almost half the requirement for a balanced diet. The fruit production in India has recorded a growth rate of 3.9%, whereas the fruit processing sector has grown at about 20% per annum. However, the growth rates have been extensively higher for frozen fruits and vegetables (121%) and dehydrated fruits and vegetables (24%).

Fruit and vegetables are mostly seasonal crops but they are demanded by consumers throughout the year. They are very highly perishable in nature, which is difficult to preserve for the longer period of time under ambient storage conditions. The low temperature storage retarded the activity of various biological and biochemical agents of spoilage and provides longer shelf life to the fruit and vegetables The temperature is brought down by taking out the heat with the help of mechanical refrigeration, This system is based on a liquid absorbing heat as it change to a gas. The more common mechanical refrigeration system use a refrigerant such as (Ammonia, Freon etc.,) takes out the heat from the chamber/ store as it is expand. The spoilage agents are microorganism such as (e.g., bacteria, yeast and molds etc.) and larva. Optimum storage temperature for most products is one slightly above the freezing point of the product. Some fruit and vegetables are particularly sensitive to storage temperature are susceptible to called storage disease when stored at temperature below as or above the critical temperature e.g.,

7.1 Introduction
Certain bacteria are present in milk that is extracted from the udder; they increase in quantity as it is processed further. The optimal temperature range for the proliferation of typical milk bacteria is 20 to 40 degrees Celsius. The formation of unpleasant flavours, increased acidity, and other factors always results in a decline in market quality following the proliferation of bacteria. Prompt chilling to a low temperature is one method of preserving milk. Milk jug Refrigerator: In order to preserve the purity of the milk received at the Dairy/Chilling Centre, it is chilled to 4°C using a milk chiller. Stainless-steel plates comprise the chiller. The process of chilling involves the circulation of chilled water from one side of the plates and milk from the other.
7.2 Methods

The milk is not only cooled, but it also remains cold, necessitating a significantly smaller mechanical refrigeration unit. This is achieved by transporting pails.

Abstract

Chitin has been ranked at second position after cellulose as the most abundant natural biopolymer. Chitin has similar chemical structure to that of cellulose with 2-acetamido-2-deoxy-b-d-glucose (NAG) monomers attached via ß (1–>4) linkages. Chitosan is the deacetylated (to varying degrees) form of chitin, which, unlike chitin, is soluble in acidic solutions. Therefore, Chitosan, a copolymer of glucosamine and N-acetyl glucosamine, is amongst the most copious biopolymers on earth and finds wide range of biomedical and industrial applications. It has been approved in 1983 by USDA as a feed additive. Chitin basically is obtained from prawn/crab shells and chemical treatment of chitin produces chitosan. Since supplies of seafood waste are seasonable and variable, so fungi can be used as alternative source for chitosan. The unique physicochemical properties of chitosan provide great potential of its utilization in food industry especially dairy industry such as production of dairy products, dairy waste water treatment, extension of shelf life of dairy products etc. In recent years, exotic synthetic compounds are losing their appeal, thus application of chitinous products in dairy as well as processing aids has received considerable attention. The modified chitosan with greater functional properties has increased application in different dairy foods. This chapter focuses on the fundamental uses of chitosan and their derivatives in a variety of dairy industry applications.

Chocolate is almost unique as a food in that it is solid at normal room temperatures yet melts easily within the mouth. This is because the main fat in it, which is called cocoa butter, is essentially solid at temperatures below 25^oC when it holds all the solid sugar and cocoa particles together. This fat is, however, almost entirely liquid at body temperature, enabling the particles to flow past one another, so the chocolate becomes a smooth liquid when it is heated in the mouth. Chocolate also has a sweet taste that is attractive to most people.

The first known cocoa plantations were established by the Maya in the lowlands of south Yucatan about 600 AD. Cocoa trees were being grown by the Aztecs of Mexico and the Incas of Peru when the Europeans discovered central America. The beans were highly prized and used as money as well as to produce a drink known as chocolatl. The beans were roasted in earthenware pots and crushed between stones, sometimes using decorated heated tables and mill stones, similar to those illustrated in Figure 1.1.

The development of a recipe for chocolate should be based on three criteria:

(i) The intended market or use;

(ii) The limitation being placed on material and production costs;

(iii) The desired quality.

The amount of fat present in the chocolate will affect the flow properties, and fat content must therefore be varied according to the intended use.

Some point to remember while manufacturing chocolate:

1. To maintain proper viscosity if fat content is increased then sugar content should also be increased.
2. Milk chocolate requires lower fat content than dark chocolate.
3. Addition of emulsifier like commercial lecithin can save upto 5% of added cocoa butter.

Introduction

The emerging functional foods market presents a considerable challenge to all manufacturers to keep abreast of the use of adequate packaging materials for their products. The interest in functional foods is intrinsically linked to the potential health benefits of their bioactive components. Preserving these bioactive components is, therefore, a crucial factor to providing the anticipated health benefits of functional foods. However, recurring failure in maintaining the quality of functional foods has been reported. Functional foods include a wide variety of products such as prebiotics and probiotics, dried foods (fibers, tea, herbs, etc.), fermented products (yogurts, kefirs, vegetables), and fresh fruits and vegetables. Their bioactive components (minerals, vitamins, fibers, peptides, proteins, w–3 polyunsaturated fats, antioxidants, enzymes, and symbiotics) range from very simple molecules to complex living organisms such as bacteria.

Weaning foods

Introduction

Breast milk is natural and best for the growth and development of newborn babies. Although breast milk is adequate to provide an optimum nutrient till the age of six months but after that it is not sufficient to sustain optimum growth and fulfill their nutritional requirements. Various nutrients are required to supplement milk until child is ready to eat adult meal. This additional food along with the breast milk is referred as “complementary Food”. With adequate amount of complementary feeding breast-feeding continues up to two years of age and beyond so, referred as complementary feeding period.

Appropriate and adequate amount of complementary feeding helps in preventing malnutrition stunting and promoting growth. Introduction of this complementary food is called as weaning.

Weaning is the process of introducing adult food and beverage to the infant to support their growth and development. This is very crucial period in infant’s life. This is a period for diet transition as the nutrition requirements for growth and brain development is quite high. Introduction of various taste and texture promotes biting and chewing skills (Guthrie, 1975). Most six-month age children start eating semisolid foods. Weaning homogenized infant foods play a major role in the nutrition of infants (Martinez, 2004).As infants grow, their nutritional requirements also increase. To keep up this growing demand WHO recommends that infants start eating solid, semi-solid or soft foods at the age of 6 months to ensure sufficient nutrient intake.

Citrus is one of the most important fruit crops of the world. The most important commercial citrus fruits in India is mandarin oranges followed by sweet oranges, lemons and acid limes. Citrus fruits are used for fresh fruit juices, processing into squashes, marmalades and its essential oils from peel are widely used in flavouring, perfumery and cosmetic industry. The citrus peel is one of the important sources for manufacture of pectin.

It is believed that most of the species under the genus citrus are native to tropical and subtropical regions of South-East Asia, particularly India, China and in the region between these two countries. The north-eastern region of India is considered as one of the natural homes for few species of citrus. The other major citrus producing countries of the world are Brazil, USA, India, China,Mexico, Spain, Egypt, Italy, Indonesia and Trukey.

Sweet Orange (Cirus sinensis Osbeck) or Mosambi

Sweet orange is one of the most widely favored citrus fruit of of the world. Its scientific name is Citurs sinensis Osbeck. The sweet oranges are generally round to oval in shape; tight skinned with solid central core. The skin is yellow to orange in colour, smooth and pulp is yellow to orange or reddish. The segments are tightly attached to one another. The commercially important varieties are Malta (Blood Red), Mosambi and Satgudi. Other exotic varieties like Valencia, Washington Navel of USA and Shamouti of Isreal.

Abstract

Classification of the hundreds of possible dryers is essential to the logical selection of appropriate dryer for a given application. Diverse criteria for classification as well as selection of dryers are presented and discussed briefly. The advantages and limitations of different dryer types must be taken into consideration. Initial capital cost is often the key deciding criterion in industrial dryer selection. This is not a good strategy as the user must pay for the operating costs over a long period of life of the dryer. In general several different dryer types are suitable for a given product. Careful selection is essential for cost-effective operation of the dryer.

Improvements in microscopes enabled scientists to study the ‘invisible’ organisms – that is, those too small to be seen with the naked eye. They were able to show that certain of these microscopic creatures are responsible for the infectious diseases of higher organisms. Most of them are harmless, some are essential for life and some are used in the manufacture of products that are of benefit to humans.

LAB constitutes a group of gram positive bacteria. They are nonsporulating, nonrespiring but aerotolerant cocci or rods, which produce lactic acid as one of the main fermentation products of carbohydrates, they do not have cytochromes. They belong to the phylum Firmicuttes, class Bacilli and order Lactobacillaceae. The group includes several genera such as Lactobacillus, Lactococcus, Bifidobacterium, Pediococcus, Enterobacter, Corynebacterium, Streptococcus, Leuconostoc etc.

Stored grain pests are one of the major constraints in obtaining quality seeds. They cause substantial yield loss in storage conditions affecting both the quality and quantity of the produce. Apart from causing direct loss to the grains, they also make them unfit for consumption through their excreta, scales and wings resulting in development of unpleasant odour (Upadhyay and Ahmad, 2011). They also act as a source of medium for growth of fungi or bacteria (Daglish et al., 2018). The method of infestation of stored gain pests is different from the insect pests infesting crops under field condition. Generally, the infestation of storage pests starts after harvesting. It has been reported that in India, there is a loss of about 14 million tons worth Rs. 7000 crores due to the infestation by different storage pests (Chaubey, 2022). The post-harvest loss in terms of quantity and quality by different storage insect-pests accounts for about 10-30 per cent (Rajasri and Kavitha, 2015; Yaseen et al., 2019).

1. Introduction

Cleaning and grading are the first and vital post harvest operations undertaken to remove foreign and undesirable materials such as crop seed, chaff, mud, stones, straws, immature grains, dust, husk and even iron and steel particles from grains as well as fruits and vegetables and to separate the products into various fractions. Generally, the hand threshing and the traditional handling used in most developing countries cause a larger percentage of foreign matter with these crops. Thus, more cleaning is required. Cleaning is essentially a separation process, in which some difference in physical properties of the contaminants and the food units is exploited. 

Fruits and vegetables are more perishable and generally have a higher value compared to cereals, making them very important in terms of minimizing waste and improving employability in the food industry. The losses in fruits and vegetables are significant, but through effective post-harvest processing, these losses can be reduced, and surplus produce can be better utilized. This processing involves a variety of techniques that prepare fruits and vegetables for conversion into processed foods. The food preservation and processing industry has evolved from being a luxury to an essential sector, playing a crucial role in conserving and enhancing the utilization of fruits and vegetables. To prevent waste during peak seasons and ensure availability during off-seasons, modern methods of storage and processing are necessary. These techniques allow for both large-scale and small-scale processing, extending the shelf life of produce for better distribution. The ultimate goal of food processing is to apply systematic techniques to preserve, process, package, store, and distribute food in a way that ensures a steady supply of diverse and nutritious food options, thereby improving food intake and nutritional standards, particularly during periods of low availability.
For effective preservation and processing, key prerequisites include cleaning, grading, and sorting the produce based on its maturity level. This ensures that only the highest quality fruits and vegetables are used in the processing chain, maintaining food safety, nutritional value, and consumer acceptability throughout the year.
CLEANING OF AGRICULTURAL COMMODITIES
Blanching is a unit operation used in food processing to remove contaminating materials from food and prepare the surface for further processing. In vegetable processing, blanching serves the additional purpose of cleaning the product. This process involves briefly exposing the food to heat, typically by immersing it in hot water or steam, which helps to remove dirt, enzymes, and microbial contamination. By doing so, blanching not only improves the quality of the food but also prevents microbial growth during storage or delays in processing. This early removal of contaminants ensures that the remaining bulk of food is preserved and remains safe for consumption throughout its shelf life.

29.1 Introduction
Cleaning is achieved using a cleaning agent designed to remove food, dirt, rust stains, minerals, or other residues. It is crucial to choose the appropriate cleaning agent, as not all are suitable for surfaces that come into contact with food. In a food-processing facility, sanitation involves ensuring that utensils and equipment that come into contact with products are kept clean and sterile. Additionally, clothing, air, packaging materials, and non-contact surfaces like floors, walls, and ceilings must be sanitized to prevent product contamination. Employees’ bodies, especially their hands, can also be sources of contamination, so maintaining high personal hygiene and cleanliness standards is essential. Moisture and heat can lead to microbiological contamination of both products and the environment. Moisture on product-contact surfaces and within products creates a medium where microorganisms can thrive and find nutrients, potentially affecting the safety and quality of milk and dairy products.
29.2 Types of Soil
Cleaning involves removing food residues and other types of soil from surfaces like utensils and equipment used in the dairy and food industries.
• In the dairy-processing sector, the equipment must be cleaned of various types of soil including: liquid milk films, air-dried films, heatprecipitated films, heat-hardened films, milk stone, and other foreign materials.
• Soluble soils will dissolve and be carried away in rinse or wash water. For insoluble soil components, chemical detergents may be needed to either dissolve them or soften them to facilitate easier removal.
• Cleaning or sanitizing the product contact surfaces of dairy equipment involves both washing and sterilizing. It’s important to avoid causing undue wear, erosion, or corrosion to these surfaces, as this can reduce their lifespan

There is no single factor as important in the production of fine quality dairy products as absolute and complete cleanliness.

It is not enough to provide milk for man, it must be high quality milk. It would be impossible to provide man with milk and milk products of superior quality if we were unable to remove milk soil and to kill residual microorganisms. Respectively, these are the processes of cleaning and sanitizing.

To successfully provide the atmosphere for proper food safety, the basics must be thoroughly understood. The basics of food safety begin with good understanding of sanitation processes, food-handling procedures that protect from, or eliminate cross contamination problems and specific attention to inspection of and follow up for all processes. Food safety activities need to be programmed into available time of day scheduling just as production requirements do. Whether special personnel or separate shifts handle cleaning responsibilities or you clean as you go on the production line, time must be made available. Safe products leaving the facility must be the watch word of all employees involved with the process.

In order to ensure safe food supply a high level of sanitation should be maintained throughout the food production chain. The word ‘sanitation’ is derived from the Latin word “sanitas” which means “health”. To further apply this word to the food industry, sanitation is the creation and maintenance of hygienic and healthful conditions when processing, preparing and handling food. Sanitation is the application of science to provide wholesome food handled in a hygienic environment by healthy food handlers to prevent contamination by food spoilage microorganisms. Effective sanitation refers to the mechanisms, which accomplish these goals.

Cleaning and sanitisation are the two processes employed in dairy industry to ensure hygiene and product safety. The safety of milk and milk products is a very important aspect and every attempt should be made, during processing, to minimize contamination through handling and processing equipments. The accumulated dried milk solids (milk stones) consist largely of calcium phosphate, milk proteins (precipitated, coagulated and baked on by heat) and insoluble calcium salts from water and washing detergents. The surface can also contain biofilms, which are formed by the incorporation of bacteria into the accumulated inorganic and organic materials that attach to most surfaces. With time and in the presence of nutrients, a biofilm and the bacteria within the biofilm will grow and become strongly attached to the surface. The removal of dairy soil, milk stones as well biofilms is the prime objective of the cleaning process. International Dairy Federation (IDF) defines a clean surface as one which is free from residual film or soil that will not contaminate the food products coming in contact with it.

While cleaning refers to the removal of soil from the surface of the equipment, sanitisation implies destruction of all pathogenic and almost all non-pathogenic organisms. Cleaning and sanitisation are complimentary processes. Either of the processes alone will not achieve the desired result, which is to leave the surface as free as possible from soil and viable organisms. In actual practice cleaning and sanitisation overlap to some extent, as during cleaning a high proportion of bacteria are destroyed and others get removed in the detergent solution. Inadequate or faulty cleaning and sanitisation can have serious consequences, as milk is a prefect nutrient in which bacteria can multiply. A thorough understanding of the cleaning methods is, therefore, necessary for economic production of high quality food products.

Cleaning and sanitizing of dairy plants is essential for providing safe milk products to the consumers as well as for ensuring the good shelf life of these products. It ensures cleanliness, hygiene of the equipments and surroundings and also ensures that the products meet the safety standards. Cleaning of dairy plant consists of broadly of removing the soil from the surface of the equipment by dissolving or suspending the soil in a warm solution of suitable cleaning agents. In the dairy industry, the soil is primarily milk and milk product residues which may be more or less modified by processing treatment. 
Milk and milk product residues are complex mixtures of milk sugar, fat, proteins and mineral salts. Some of these solids are present in emulsion, some are in a colloidal state, and others are in true solution. When milk products are heated in vats or pumped through sanitary pipe lines or over coolers, the metal or glass surfaces become coated with milk remains, which, if allowed to dry, may be difficult to remove.

Cleaning and sanitation are essential for maintaining microbiological safety in ice cream manufacturing, particularly because contamination can occur after pasteurization and freezing does not eliminate all microorganisms. This chapter explains contamination routes, hygienic zoning, cleaning systems, sanitization practices, HACCP principles, and microbiological expectations within an ice cream plant. It examines CIP and COP systems, detergent components, cleaning factors, high-risk equipment and surfaces, and post-pasteurization contamination control. Cleaning, drying, and aeration are essential processes in the management of stored agricultural products to maintain their quality and reduce the risk of spoilage. These practices are particularly important in preventing the growth of molds, the infestation of pests, and the deterioration of the product during storage.
Cleaning is the first step in the storage process. It involves removing any debris, dust, dirt, and residues from both the stored products and storage facilities. Proper cleaning eliminates potential sources of contamination, such as pests, molds, and bacteria, which can thrive in the presence of organic matter. It also ensures that the grain or other stored product is free from contaminants that could affect its quality and marketability.
Drying is equally crucial to prevent moisture-related issues. Excess moisture can lead to mold growth, fungal infections, and insect infestations. Drying reduces the moisture content of the grain or product to safe levels, typically below 14% for grains, which helps preserve their quality during storage.
The drying process can be carried out using natural sunlight or mechanical dryers, depending on the volume of the product and available resources. Properly dried products are less prone to spoilage and can be stored for longer periods. Aeration involves the circulation of air through stored products to maintain optimal temperature and humidity levels. By controlling the environment, aeration helps prevent the buildup of heat and moisture, both of which can lead to product deterioration.
It also reduces the risk of insect infestations by keeping the grain cool and dry. Aeration systems typically use fans or ventilation channels to ensure continuous airflow, especially in large-scale storage facilities. Together, these processes form a comprehensive approach to maintaining the quality and safety of stored agricultural products.

10.1 Introduction

Food safety and quality are the two important factor which results in consumer food choices. Nowadays consumers are demanding food which is safe and of high quality in terms of nutrition due to a healthier life style. Food safety and quality are the terms used interchangeably. Food safety refers to all those hazards, that make food injurious to the health of the consumer and it is not negotiable. Food quality includes attributes that influences the product's value to the consumer. This includes both negative and positive attributes; negative attributes includes spoilage, contamination, discoloration, off-odours and positive attributes include colour, flavour, texture and processing method of the food. This distinction between safety and quality has implications for public policy and influences the nature of the food control system. Food control is defined as a mandatory regulatory activity which provides consumer protection and ensures food is safe, wholesome and fit for human consumption during production, handling, storage, processing, and distribution.

Despite the huge efforts made by the food safety authorities and industries, food safety still remains a critical issue. In food industries, producers have to satisfy both safety and quality criteria for their products to the consumer. Food processors have multiple options in terms of different quality and management systems, they have to choose the most appropriate one for its specific activity and should establish, document and implement effective systems in the processing area for managing quality and safety of the product. Over the past few decades, food-borne illnesses have raised great concern about the safety of food. Considerable steps are taken by the food processor for understanding and managing the risks of airborne diseases. Among various systems, Hazard Analysis and Critical Control Point (HACCP) is effective tool which focuses mainly on controlling hazards to ensure the production of safe and wholesome food. For maintaining the safety and increasing the shelf life of food, traditionally it has been preserved by thermal processing, freezing, salting and drying. But nowadays consumers are demanding convenient, innovative, fresh foods, including new "minimally processed" products. To meet consumers' expectations in the 21^st century, the food industries are implementing novel technologies whose purpose will be two fold: 1) to provide the new quality attributes demanded by consumers; and 2) to ensure the all important and often expected assurance of food safety. The novel technologies will include various minimally processed technologies like high pressure processing (HPP), pulsed electric field (PEF), ohmic heating, dielectric heating, microwave heating, ultrasound, modified atmosphere packaging (MAP) and cleanroom technology. Among these cleanroom technology have attracted great attention for maintaining the safety and quality of the food products as because it doesn't have any effect on the nutritional quality of the food being processed, it maintains the hygienic condition in the processing area, remove contaminants from the processing area and clean air in the processing area which in turn results in safe food product. The main objective of cleanroom technology is to eliminate airborne contaminants from the humans and/or from the environment. An air curtains and a positive air pressure is maintained in the processing unit using filtered air. Production personnel will use the special clothing which is preferred for cleanroom to reduce the contamination from both air- and human-borne microorganisms. In this chapter we will discuss about cleanroom technology, its historical background, its classification, layout of cleanroom, air handling, personnel and its clothing, regulations in cleanroom, and its application in food industries.

INTRODUCTION

One of the most important changes in the global environment which affects the existence of all living things , is the climate change. The climate change globally and locally also changes the aquatic habitat which, in turn directly and indirectly affects the environment. Anyway, the changes in climate are certain to occur and may be inevitable. The only possible way is to analyze the situation and find out the reasons for such changes and take immediate steps to minimize the impact of these climate changes. Global warming has eventually become synonymous with climate change because almost all the variables of the ecosystem are influenced directly or indirectly at different levels.

Aquatic environment is extremely diverse and influenced by the climate changes to a large extent both locally and globally. The changes in the ocean and its life are well studied at different levels with all possible details compared to the freshwater habitats. Unlike agriculture and animal husbandry, the vast majority of the fish production still comes from the natural habitat or the wild collections. Agriculture and animal husbandry usually focus on few important species but for fisheries, all the species of fishes including most of the aquatic living organisms are commercially important. The media (water) in which the aquatic organisms dwell, is much more important to all living organisms of the earth and so the influence by climate changes on water becomes very much relevant in the present situation. Freshwater habitats are limited and are much more complex to investigate in respect of climate changes due to the variability and diverse micro and macro level interactions. A holistic approach to deal with all these problems has not got much attention both globally and locally even though , it is the need of the hour to address the issues of impact of climate changes in the aquatic environment.

Livestock plays a very important role in the mixed farming system of the country contributing about 25 per cent of Gross Domestic Products (GDP) from agricultural sector. India has the largest population of cattle and buffaloes and the highest producer of milk in the world. India has also the second largest population of goats and one of the leading countries in poultry sector. There has been a tremendous increase in milk, meat and egg production since independence. However, owing to various reasons viz. , low genetic potential, scarcity of feeds and fodders, diseases, poor management practices etc. , the productivity is quite low. Climatic conditions of a place have also an important bearing on livestock production and productivity. Climatic factors like ambient temperature, humidity, solar radiation and wind velocity are the important ones which make up the physical environment of the animal having direct and indirect influences on animal’s responses towards climate. Temperature and humidity are the most crucial with the former being the most researched one. Extremes of hot and cold weather are creating stress to any animal and the effects are more severe under hot and humid climate. The varied effects of undesirable climate on animals are pertaining to feed and water intake, physiological, biochemical and endocrinological aspects, reproduction, health and productivity etc. Thus, the positive and negative effects of the environment on the livestock have been discussed in a way to undertake some protective measures.

INTRODUCTION

India has varied agroclimatic conditions, which favour the cultivation of various horticultural crops. Based on the adaptability and system of cultivation, the horticulture can be grouped into four major class such as Temperate, Sub-tropical, Tropical and Arid. India has become the second largest producer of both fruits and vegetables with a total production of 46. 75 million tonnes of fruits from an area of 4. 56 million ha and 93. 16 million tonnes of vegetables from 6. 30 million ha (2003-2004). Besides, there is a tremendous scope for increasing the production of flowers, spices and condiments, plantation crops and medicinal and aromatic plants. Floriculture has emerged as a viable agribusiness. The commercial cultivation of flowers in open field conditions was much popular than protected cultivation in India. But, now- a-days, the protected cultivation has brought a great revolution in Indian floriculture and it helps for the quality production and export to earn sizeable amount of foreign exchange. India has approximately 350 ha under green house cultivation with export value of approximately Rs. 330 crores during 2003-04(APEDA). On the other hand, the prevailing climatic conditions in India are highly suitable for cultivation of the almost all spices from tropical black pepper to temperate saffron. The major spices are mainly grown in humid tropics like Western Ghats and NE States. Out of 21 agro-ecological sub regions in India, spices are grown in 14 different agro ecological sub regions. Fruits, vegetables, flowers spices and condiments, plantation crops and medicinal plants are widely distributed across the country, while plantation crops are restricted to a few regions.

Agricultural production system has gone a long way in supporting the world’s food requirement. The projected estimates revealed that to meet the global population of about 11.3 billion in 2050, the global demand for cereal will increase by 60% (Rosegrant and Cline, 2003, Bengtsson et al., 2006). Agriculture is considered as the chief agent of environmental transformation. The unrestrained attitude of Homo sapiens towards the use of natural resource catalyzing the causes leading to global warming, has increased the challenges manifold to provide food security in a sustainable manner. Increased concentration of CO2 and other green house gases have resulted in an increase of 0.760 C in surface temperature globally since nineteenth century and the mean global surface temperature is predicted to increase by an additional 1.30C to 1.80C by 2050( IPCC, 2007). Sinha and Swaminathan (1991) reported that an increase of 20C in temperature could decrease the rice yield by about 0.75 t/ha in the high yield areas and a 0.5oC increase in winter temperature would reduce wheat yield 0.45 t/ha.

·    There are multiple pathways through which climate-related factors may impact food contamination and food safety, food quality, foodborne diseases including changes in temperature and precipitation patterns, increased frequency and intensity of extreme weather events, ocean warming and acidification and changes in the transport pathways of complex contaminants.
    
·    All or most foodborne pathogens and their associated diseases are linked to changing environmental conditions, the notable of which are campylobacteriosis, salmonellosis and vibriosis.
    
·    An estimated 30% of reported cases of salmonellosis across much of continental Europe have been attributed to warm temperatures, especially when they exceed a threshold of 6°C above average. Likewise both in Australia and Canada a positive correlation was found between increasing temperature and incidence of salmonellosis.
    
·    Zoonosis such as Rift Valley Fever (RVF), West Nile Fever, tick-borne diseases and non-zoonotic animal diseases such as Blue tongue, African horse sickness, African swine fever are examples of animal diseases whose distribution is expected to be strongly influenced by climate change and variability.
    
·    Mycotoxin is a toxic secondary metabolite produced by filamentous fungi, commonly known as moulds and may contaminate agricultural commodities (food) by growing on them both before and after harvest, whenever the humidity and temperature are permissive. The most prominent mycotoxins are aflatoxins, deoxynivalenol, zearalenone, ochratoxin-A, fumonisin, and patulin.
    
·    The humans ingestion of mycotoxins occur through consumption of the mycotoxin contaminated plant-based foods, such as grains, maize, barley, rice, coffee, nuts and their residues, and metabolites in animal-derived foods, for example aflatoxin M1 (AFM1) in milk and meat products. In addition, mycotoxins may occur in beer and wine.

·    Agriculture, livestock and fisheries production are all sensitive to climate and are affected by its changes. Climate change will increase hunger and malnutrition, emergence of new pests and diseases and will threaten fishing and aquaculture industries.

INTRODUCTION

The debate on climate change is going on. From the report of the Inter Governmental Panel on climate change (IPCC), a premier organization set up in 1998 by the World Meteorological Organisation and United Nations Environment Programme, it is known that the average surface temperature has increased over the 20th century by about 0. 6ºC. The number may seem insignificant but it is an unprecedented rise. In the past 150 years, the 11 hottest years were witnessed. It says that 1990s was the warmest decade and 1998 the warmest year since 1861. Worse, the Artic is warming twice as rapidly as the rest of the world and there is a distinct possibility of the Greenland Ice Sheet collapsing altogether and pushing up sea levels by several metres. It is predicted that 2035 is the year when Himalayan glaciers may totally disappear causing catastrophic disruptions. Unfortunately, India is among the countries that will suffer the most serious consequences as a result of global warming. Following is the probable effect of global warming.

Abstract
Global food production needs to double by 50% by the middle of the 21st century to ensure food and nutritional security for 9 billion people. Climate change, particularly atmospheric CO2 and temperature, has a complex impact on sustainable food security. Climate change is a significant constraint on legume production globally, which is a crucial food, feed, and fodder source. Legumes fix atmospheric nitrogen through bacteria in root nodules, reducing greenhouse gas emissions and boosting soil C-sequestration. Climate change positively impacts grain legumes by allowing them to allocate above-ground
photosynthates into below-ground parts (nodules), improving rhizospheres’ activities, plant biomass and nutrient use efficacy. However, temperature can also negatively affect grain legumes, leading to flower abortion and abnormal pod filling. However, climate models predict more extreme events in the future, affecting legume growth and development. Heat stress, elevated CO2 concentration, drought, and rainfall variability impact legume crop production, requiring adaptation options. Results show that legumes with C3 fixation pathways show higher photosynthesis, reduced photorespiration, biomass production, and water use efficiency under atmospheric CO2. However, temperature increases lead to faster development, shorter life cycles, and lower yields. Legumes can cope with atmospheric CO2 up to
1000 ppm by storing sucrose and starch. Protein synthesis and water stress also help legumes adapt to changing climates. To achieve targeted yields in changing climatic conditions, agronomic and genetic interventions must be integrated. Targeted breeding programs should select high-yielding, biotic stress-resistant, and abiotic stress-tolerant genotypes adapted to atmospheric CO2 and temperature conditions. Integrating grain legumes with desirable traits can provide resilience against climate change.

Application of Climate-Smart Agriculture

Agricultural production systems are expected to change in response to climate change and ensure food security in different countries. Climate variability may further affect the agricultural production in future. To meet such challenges, there are many options to reduce the negative impacts of climate change on agricultural systems, make them resilient to climate change, and reduce emissions. Many technologies and practices can increase crop yields, farm income, and input-use efficiency, and may reduce GHG emissions (Khatri Chhetri et al. 2017). Climate-smart agriculture (CSA) is suggested to address the adverse effects of climate change and ensure food security. It is intended to achieve the three objectives of ensuring productivity, adapting and building resilience and reducing emission of GHG.
