Dried Cocoa Bean have chemical composition as: The shell (testa) represents 10-14% dry weight of the cocoa bean, while the kernel or cotyledon is made up of most of the remaining 86-90%. The cotyledon confers characteristic flavours and aromas of chocolate and is composed of two types of parenchyma storage cells.

Before processing, the quality ofbeans is evaluated for the following indicators:

1. Degree of fermentation
2. Moisture content (maximum 6%)
3. Number of defects
4. Number of broken beans
5. Bean count (number per 100 g)

Cocoa butter, also called the obroma oil, is a pale-yellow, edible fat extracted from the cocoa bean. It is used to make chocolate, as well as some ointments, toiletries, and pharmaceuticals. Cocoa butter has a cocoa flavor and aroma. Its melting point is just below human body temperature. Cocoa butter that has been refined by neutralization with an alkaline solution and decoloured with for example bentonite, activated carbon etc. Subsequent deodorization can also be applied. The type of process used may affect the quality of the cocoa butter. For example, a too high deodorization temperature or a too severe alkalization can completely alter its setting (solidification) characteristics. High-quality raw materials are needed to make the best quality cocoa butter. The other important factors for high quality are the origin of the beans and the processing conditions used. Press cocoa butter, which is most commonly used in the chocolate industry, is only filtered and (partly) deodorized to obtain the desired flavour. Cocoa butter contains a high proportion of saturated fats as well as monounsaturated oleic acid, which typically occurs in each triglyceride.

Introduction

Botanical name of cocoa is Theobroma cacao and family is Malvaceae. The cocoa bean, also cacao bean or simply cocoa or cacao, is the dried and fully fermented fatty seed of Theobroma cacao, from which cocoa solids and cocoa butter are extracted. Cocoa flavour is the most distinct feature of chocolate, thus cocoa beans are the basis of chocolate. Dried cocoa beans are usually processed into cocoa butter, which contains fat between 56% and 58%, made up of a mixture of triglycerides. Cocoa butter with this composition is good for making chocolate and has favourable hardness and a melting point of body temperature. Theobroma cacao originated from the Jungle of the Amazon in Brazil. Theobroma cacao consists of two subspecies: the Cacao, a subspecies known as the Criollo, which can be found in Central and South America, and spharocarpum, which is also called theForastero. The Criollo has superior and fine flavour. Moisture Content
 
Two maximum moisture levels are provided to meet different climatic conditions and marketing practices. Lower values in the first column are suggested for countries with tropical climates or when long-term (more than one crop year) storage is a normal commercial practice. The values in the second column are suggested for more moderate climates or when other short term storage is the normal commercial practice.

India is bestowed with huge production of fruits, vegetables, cereals, millets, sugarcane along with meat production, milk production, fish production and poultry. Despite such a huge production in India, owing to perishable nature of these produce around 25-30 percent of the produce is being lost as post harvest loss. The one important reason for this may be the production of the crops are season specific and during the peak season the production is more while demand for consumption is less. It may be possible to cut down these losses to great extent, if these produces may be transported from the produces states to those who are not producing due to agro-climatic reasons. So for making transportation of the perishable a successful venture in decreasing post harvest loss, there must be proper cool chain management facilities both at producing site as well as marketing place. The aim of the cool chain management must be to keep the produce in saleable condition during entire storage periods. Some products are stored for short period whereas fresh fruits, vegetables require cold storage. Foods before keeping into the storage room need some pre-storage treatments for better results.

Introduction

The cold chain is a meticulously managed series of actions using specialized equipment to ensure products remain within a specific low-temperature range from production to consumption (ASHRAE, 2024; IIR, 2024). This unbroken sequence encompasses refrigerated production, storage, and distribution activities, safeguarding the safety and quality of perishable and thermo-sensitive goods like agricultural commodities (such as fresh produce, meat, dairy, seafood, chemicals, pharmaceuticals, flowers, wine, etc.), processed foods and pharmaceuticals (Aung and Chang, 2014; Awan, 2023). For climacteric fruits like bananas, custard apples, apples, pears, tomatoes, mangoes, and avocados, cold storage facilitates controlled ripening, extending the time between harvest and consumption. Cold chain management, integral to the overall supply chain, requires expertise in maintaining temperature, air quality, and adherence to regulatory standards. Any disruption in this process can lead to product spoilage and financial implications (FAO, 2019). The management of the cold chain system is crucial for preserving the freshness, taste, and nutritional value of fruits from harvest to consumption (Kader, 2003).

19.1 Introduction

Food safety is one of the important factor for food industry, regulatory agencies and consumers. Nowadays consumers are demanding food which is safe and of high quality in terms of nutrition due to a healthier life style. Food safety refers to all those hazards, that make food injurious to the health of the consumer and it is not negotiable. Food may be contaminated physically, chemically or microbiologically, mainly microbial contamination is of high concern in the food industries. Various pathogenic and spoilage causing microorganisms, viruses, insects can deteriorate the food products and cause food borne illnesses. Therefore, there is a need to eliminate these undesirable microorganisms from the food industries to ensure food safety to the consumer. Various methods are available to eliminate these undesirable microorganisms such as thermal technologies like pasteurization, dehydration, retort processing, freezing etc. and non thermal technologies like microwave heating, Pulsed Electric Field (PEF), High Pressure Processing (HPP), Pulsed Light Technology, Ohmic Heating, Ultra sonics, Pulsed X-Rays. But these technologies have certain disadvantages like thermal technologies lowers the nutritional value and leads to unwanted changes in the foods' sensory attributes of the food products whereas non thermal technologies retain better nutritional and sensory quality of food than thermal technologies but they are cost effective, required specialised equipments and trained personnel. Cold plasma technology (CPT) is a non-thermal green technology used now-a-days for variety of application in various industries especially in food industry. It is proposed to be an alternative method for eliminating microorganism from the fresh produce. This technology does not require extreme process conditions and can be used as a good alternative source for food preservation without affecting its nutritional and sensory attributes. Plasma is an ionized gas, consisting of active species like positively and negatively charged ions, electrons, free radicals, and gas atoms, metastable and quanta of electromagnetic radiation (photons). When the energy source is turned off, active species used to disappear immediately, therefore cold plasma technology is environmental friendly and fulfilling all ecological standards. Based on the properties of plasma, it can be applied in various fields like electronics, life sciences, textile, packaging and food industries. In food industries, it is showing promising application by retaining the nutritional, functional, and sensory characteristics thus ensuring the fresh appearance of the food product and satisfying the consumer need.

Thermal heating methods are used from long time to decontaminate the food products from microorganism and therefore increase its shelf life and ultimately make the product safe for human consumption. But these methods diminish the sensory, physicochemical and nutritional properties of food (Barba et al., 2012). Also, the cost of generation of heat in manufacture of food product make the product costlier in thermal processing and also create environmental issue.

The technique of preserving fruit by the use of low temperature dates from the eighteenth century with the first use of ice house in 1750. Later in 1800s commercial cold storages have come up for the storage of perishables like meat, dairy and fruit products.  The main change took place in the cold store in recent years has been the introduction of multi temperature chambers with humidity control for specific products. Cold preservation can be either refrigeration or freezing. Household refrigerators usually run at 4-7^ºC. Chilling or cold storage usually uses a slightly lower temperature on the basis of the food to be refrigerated. In freezing a temperature of -18^ºC or below is used. Chilling will preserve perishable foods for days or weeks and freezing will preserve foods for months or even years.

Cole crops are a group of vegetables belonging to the family Brassicaceae (Syn: Cruciferae) and include cabbage, cauliflower, knoll khol, kale, Brussel sprouts, sprouting broccoli, etc. Cole crops are found spread all over Europe from the Mediterranean region, which is supposed to be the centre of origin. In the ancient Egyptian and Asian civilization, there was mention of cole crops and also by Aristotle in his writings on ‘Enquiry into plants’ there was mention about three types of coles. It is believed that it was first collected for food at the beginning of Neolithic times before being cultivated, and the cultivated forms of cabbage group like, cabbage, savoy, kales, collard, broccoli, Brussels sprouts, cauliflower and kohlrabi gradually originated from wild species through mutation, human selection and adaptation.

Among the cole crops in India cauliflower and cabbage are the two most important crops while Kohlrabi is grown very less. In India it is cultivated in states of Uttar Pradesh, Karnataka, Maharashtra, Bihar, West Bengal, Punjab and Haryana. It is also grown in milder climates in southern India like Ooty, Bangalore, etc.

3.1. Cabbage (Brassica oleracea L.f. alba)

Cabbage, Brassica oleracea Linne (Capitata Group) is a popular vegetable belonging to the family Brassicaceae (or Cruciferae) and is used as a leafy green vegetable. It is in the same genus as the turnip – Brassica rapa. Cabbage leaves often have a delicate, powdery, waxy coating called bloom. The occasionally sharp or bitter taste of cabbage is due to glucosinolate(s). Cabbages are also a good source of riboflavin.

In India cabbage is widely grown in the states of Uttar Pradesh, Orissa, Bihar, Assam, West Bengal, Maharashtra and Karnataka.

Cultivars/Varieties: Cabbage cultivars are classified on the basis of colour of head and maturity. In India white cabbage is important and these are available in pointed, round and flat shapes. Of these round cabbages are preferred. Common cabbage varieties grown are Golden Acre, Pride of India, Copenhagen Market, Red Acre, Pusa Drum Head, Pride of India, Pusa Agethi, Pusa Muktha, KGMR-1, Kateri, Hardam and Nakshatra.

Introduction
Similar to the procurement of raw materials in a factory, milk collection is one of the initial and essential steps for a milk processing or marketing company. A successful milk collection system combines efficient route planning, quality control, and effective farmer engagement. By prioritizing technology integration, cold chain management, and regulatory compliance, dairy companies can establish a reliable and sustainable milk procurement system that meets both operational and quality standards.
India dairy sector depends on smallholder individual milk producers, each contributing between one to a few litres of milk per day. Typically, milk production takes place in rural areas, while the demand is concentrated in urban centres. However, rural producers often face significant marketing challenges due to the dispersed nature of milk production, scattered settlements, and inadequate supply infrastructure. Therefore, milk needs to be collected, transported, and marketed from villages to cities to ensure profitable returns for producers. Milk is usually collected from producers at designated collection points in rural areas, which serve a large number of small suppliers. This approach minimizes the need for individual chilling and storage facilities. Collection points should follow the same hygiene standards as dairy processing facilities. Milk should arrive at a chilling station within four hours of milking, especially in warmer climates. There, it must be quickly cooled to below 4°C to preserve its quality. Bulk milk coolers of required capacity are installed for the chilling and storage of milk at low temperature till it is transported to the processing plant.

6.1 Introduction
The majority of milk demand is urban, while production is restricted to rural areas in nearly all developed dairying countries. Consequently, milk must be collected and transported from production sites in the milk-shed areas to processing and distribution points in cities.
The common systems for collection (assembling) of milk are as follows.
1. Through a cooperative organisation. Established by collective or individual dairy societies. Producers are most advantageous when there are no intermediaries involved in profit labelling.
2. by contractors. Producers receive a diminished return.
3. By independent producers. Convenient for individuals who reside in close proximity to dairy processing facilities.
Note: The milk shed is the geographic region from which a city dairy obtains its fluid milk supply. India is currently contemplating the allocation of specific milk silos to individual dairies in order to facilitate their development.

INTRODUCTION

COLLOIDS :  The word colloids has actually been derived from Greek language where it means glue like. The science of colloids was founded about 1861 when Thomas Graham published a summary of his work on the diffusion of substances in solution. He classified substances into two groups, viz: crystalloids and colloids, depending on their ability to diffuse through parchment membrane. According to Graham, crystalloids readily passed through parchment membranes while colloids did not. According to modern concept, colloidal solution contain substances whose molecular aggregates possess a diameter greater than 1 mu  and less than 100 mu. If the particle size is greater than 100 mu, a suspension is obtained (Table 1).

The impacts on the various facets of life – agriculture and food processing – need no longer be addressed in a way that is well established. Nearly every aspect of the planet has shown its effect at different rates, both positively and negatively. As a subtropical region, India is also witnessing different variations in weather and an increase in temperature that affect farming. Only in recent years has the potential to reduce transpiration from plants by the use of chemicals been further explored. These antitranspirants can either control perspiration by filming the leaf surface or by manipulating the aperture of the stomach. Antitranspirants are the materials or chemicals that reduce the water loss from plant leaves by reducing stomata size and number. During transpiration, almost 99 per cent of the water consumed by the plant is lost.

Introduction

Dairy is vital to the economics of many developing countries. Animals are a source of food, more specifically protein for human diets, income, employment and possibly foreign exchange. For low income producers, dairy can serve as a store of wealth; provide draught power and organic fertilizer for crop production and a means of transport. Consumption of dairy and dairy products in developing countries, though starting from a low base, is growing rapidly. Dairying has become an important secondary source of income for millions of rural families and has assumed a most important role in providing employment and income generating opportunity. Indian Dairying is unique in more than one ways. It ranks first with its 199.1 million cattle & 105.3 million buffaloes accounting for about 51 percent of Asia’s and about 19 per cent of world’s bovine population. It also ranks first in milk production with a production of 121.8 million tones in 2010-11 and the demand is expected to be 180 million tones by 2020. To achieve this demand annual growth rate in milk production has to be increased from the present 2.5 % to 5%. Thus, there is a tremendous scope/potential for increasing the milk production through profitable dairy farming. Besides milk, the manure from animals provides a good source of organic matter for improving soil fertility and crop yields.

Chocolate is a key ingredient in many foods such as milk shakes, candy bars, cookies and cereals. It is ranked as one of the most favourite flavours in North America and Europe. Despite its popularity, most people do not know the unique or igins of this popular treat. Chocolate is a product that requires complex procedures to produce. The process involves harvesting coca, refining coca to cocoa beans, and shipping the cocoa beans to the manufacturing factory for cleaning, conching and grinding. These cocoa beans will then be imported or exported to other countries and be transformed into different type of chocolate products.

In history, 1828 marked the “modern era” of chocolate making when Dutch chocolate maker Conrad J. van Houten patented an inexpensive method for pressing the fat from roasted cacao beans along with other processes to create a fine powder known as “cocoa”. The powder was then treated with alkaline salt that helped the powder mix with water easily. The creation of powdered chocolate made it easier to mix with water, sugar and a possible combination of other ingredients to make chocolate in solid form. Many other chocolate makers began to build on Van Houten’s success to make a variety of chocolate products. In 1894, English chocolate maker Joseph Storrs Fry produced what was arguably the world’s first eating chocolate”

Modern fruit and vegetable processing industry is by and large, employing sophisticated machinery and equipment and efficient technique of production. There is still a scope for expansion of the industry by developing and exporting value-added products and on more foreign exchange. The choice of products to be manufactured will depend on the readily availability of raw materials in the area where the Processing Unit is supposed to be set up and the consumer preference in the neighbouring market. Preservation of food has to be established in the developing countries for other reasons also such as to generate both rural and urban employment, improve farmers nutrition by allowing them to consume their own processed fruits and vegetables during the off- season, stimulate agricultural production by obtaining marketable products, reduction of imports and meeting of export demand and to develop new value-added products. The food processing industry has now become more of a necessity than being a luxury. It plays an important role in the conservation and better utilisation of fruits and vegetables. To avoid the glut and utilise the surplus during the season, it is necessary to employ modern methods to extend storage life for better distribution and processing techniques to preserve them for utilisation in the off season on both large scale and small scale. Fruit and vegetable processing was first started in an organised manner in 1857, mainly to make pickles and chutneys with a view to meeting the export requirement.
Mango Processing Technologies
Mangoes are processed at two stages of maturity. Green fruit is used to make chutney, pickles, curries and dehydrated products. The green fruit should be freshly picked from the tree. Fruit that is bruised, damaged, or that has prematurely fallen to the ground should not be used.

Milk, on reception at the dairy factory is subjected to various unit operations on its way to product manufacture. Processing is applied as a means to convert liquid milk into products or to render the milk (and products) safe from harmful organisms. The basic processing operations to which milk is subjected at processing units have been described in this chapter. The common processing operations employed are depicted in Fig. 4.1. Several of these operations are routine compulsory processes common to all dairies, while certain others are undertaken for specialized purposes in some dairies.

4.1. Filtration and Clarification

At the time of milking various foreign materials such as dirt, feed, manure, dandruff, hair, flies, dust particles, worn out cells, cell debris and many other undesirable substances may find their way into milk. The process of removal of this extraneous matter (solid particles of higher density than that of milk) is called filtration or clarification. This can be achieved either by simple filtration through specially woven filter cloth or continuous process of centrifugal clarification that helps

1.1 Physiological Disorders

A wide variety of physiological disorders are found in apple fruit, but the susceptibility varies with variety, pre-harvest factors and post harvest conditions. Disorders can be considered in three categories:

1. Disorders that develop only on the tree: Most important is watercore in which intercellular air spaces in the core and cortical tissues become filled with liquid, Presence of watercore in fruit at harvest creates problems in certain varieties such as ‘Delicious’ because fruit with moderate or severe watercore can develop breakdown during storage.
2. Disorders that develop on the tree and during storage: Bitter pit is a disorder characterized by development of discrete pitting of the cortical flesh. Rapid cooling, CA storage and application of postharvest calcium drenches may be able to reduce its occurrence.
3. Disorders that develop during storage: Senescent breakdown disorders, chilling disorders and disorders associated with inappropriate atmospheres during storage are common disorders. The most common disorders associated with temperature and atmospheres are superficial scald, soft scald, low temperature breakdown, brown core, internal browning, low O2 injury, and high CO2 injury.

Introduction

Fermentation is the process in which edible microorganisms invade food substrates and convert them into fermented foods including beverages, using their enzymatic and metabolic processes. These end products will have nontoxic flavors, aroma and texture which enhance the palatability. The word “fermentation” is originated from a Latin word fermentare, defined as “to leaven” (Frias et al., 2016). It is one of the oldest food processing technologies used by humans to preserve perishable food materials for long time, dated back to ancient human civilization (Hutkins, 2008). Globally, more than 5000 varieties of fermented foods are currently in use which includes traditionally fermented dairy products such as Dahi in India to industrial production of wines from fruits (Tamang, 2010) (Table 1 and Figure 1). Biochemically, fermentation is a metabolic process in which energy is derived from organic compounds without the involvement of an exogenous oxidizing agent. Fermentation may result in the production of many by-products such as carbon dioxide, alcohol, organic acids (lactic acid, acetic acid), vitamins, enzymes etc. which are now having more importance in food industries (Caplice and Fitzgerald 1999).

3.1 Introduction
The mammary glands of mammals produce milk, an opaque milky liquid. It is the primary source of nutrition for young mammals before they are capable of digesting other forms of food. The immunoglobulins are transported to the young ones by the early secretion of udder immediately following parturition, which is referred to as colostrum. It has the potential to mitigate the risk of numerous maladies in newborns. The precise composition of fresh milk varies depending on the species, but it contains substantial quantities of calcium, protein, and fat. The mammary glands of mammals produce the opaque white liquid known as milk. Up until they are capable of digesting other types of food, it is the primary source of nutrition for juvenile mammals. Milk serum is defined as milk plasma minus casein micelles, a composition that is similar to that of whey.

The major constituents of milk are
Water is the medium through which the other milk constituents are dissolved or suspended. The majority of the fat in milk is present in the form of small globules, with an average size of 2 to 5 microns (with a range of 0.1 to 22 microns). This is known as milk fat (lipid). Fat is present in an oil-in-water emulsion. Milk fat is composed of numerous fatty acid glyceride esters; when it undergoes hydrolysis, it produces a mixture of glycerol and fatty acids. Proteins from milk: Proteins present in milk: Protein is one of the most intricate organic substances. Proteins are composed of numerous amino acids; some amino acids are essential, while others are not. In order for the body to synthesise proteins, the diet must include the essential amino acids. The preponderance of the proteins in milk are composed of whey proteins, beta-lactoglobulin, and alpha-lactalbumin. Milk is the primary source of casein, a calcium caseinate phosphate compound.

Abstract

Modern agriculture largely depends on use of high cost inputs and energy intensive farm machinery. Worlds increasing population and continuously deteriorating soil fertility has alarmed agriculture system to look for some safe alternatives. Organic manures are rich source ofnutrients and humans, therefore crop residue recycling by composting is a best alternate of modern high cost input based agriculture. Compost is an aerobically decomposed organic matter .Bacteria, fungi, actinomycetes algae and protozoa are involved in the process of composting and are found throughout the natural environment. The composting material warms up due to microbial activity and it’s temperature becomes up to 160 ⁰F active stage of microbial activity . There are four types of compositing i.e. Windrow composting, Aerated static pile composting, In-Vessel composting and Vermi-composting. The C: N ratio, aeration, temperature and moisture are major factors affecting composting process. Major advantages of composting are: Aggregate formation, Reduction in bulk density, Increase in hydraulic conductivity, Reduction in loss of soil moisture, Increase in organic carbon content and pH of soil.

Abstract

Food dehydration is an oldest method to increase the shelf life of food by reducing the water activity. A dried food product provides advantages of increased shelf life and reduced cost due to decreased weight as well as transportation. However, there is a decrease in product quality due to inadequate control on drying process parameters such as drying temperature and moisture removal together with change in thermo-physical properties of food. Computational modeling and simulations can provide a unique insight on the drying parameters that influences the product quality, and optimize the process conditions which are difficult by experimental analysis. Moreover, the computational techniques are advantageous over experimental optimization methods by minimizing the time and cost. This chapter reviews different computational modeling techniques such as, finite element modeling, finite volume and finite difference methods for modeling of food dehydration process. Also, this chapter describes the application of modeling techniques for determining the influence of shrinkage and porosity during dehydration.

Milk may be concentrated as a necessary initial step in drying operation or as concentrating step in the manufacture of sweetened condensed milk or evaporated milk or the preparation of infant formulae. In order to preserve the milk constituents in a concentrated form, condensed milk/concentrated milk is manufactured from whole skim milk by removing or evaporating part of the water under vacuum. But this form of milk still has limited shelf life. Attempts to prolong the shelf life of this product have been made through the addition of bacterial growth inhibitor like sugar (sweetened condensed milk) or by heat processing (evaporated milk) to destroy the microorganisms.

Concentrated milk industry is an important segment of dairy industry. It plays an important role in the economy of industry. It serves as a balanced economy. It utilizes surplus milk in the flush season. It utilizes abundant milk production in certain localized area. It makes use of surplus milk below excellent grade. By either concentrating or drying less space is needed to store and it becomes less bulky and therefore it can be transported to any part of the world. The keeping quality of milk is increased. The concentrated products give considerable saving in the cost of packaging, storage and transportation. Milk concentrates can be easily reconstituted with required amount of water corresponding to that removed by evaporation to yield a product having normal consistency of milk. It is estimated that nearly two per cent of the world’s milk production is converted into different types of condensed or concentrated milks.

Brief history and developments: The present day concept of preservation of milk by concentration and by application of heat had the beginning with the pioneering work of French man Nicholas Appert around 1793. Gail Bordon of USA was first to commercially exploit the method of concentration of milk under vacuum. He was awarded U.S. Patent in the year 1856 for processing milk in a semi-fluid state after evaporating under vacuum. Commercial production of sweetened condensed milk by Gail Bordon started in 1856.

1. INTRODUCTION

Juices and pulps are produced from a wide variety of fruits and vegetables around the world, while some medicinal plants and herbs are also used for preparation of extract of beneficial bioactive compounds. These juices and extracts contain very high proportions (upto 75-90%) of water. Due to their seasonal nature, these products can not be produced round the year in various parts of the world. Preservation, storage, transportation and marketing of single strength juices, pulps and extracts is not at all economical due to the presence of large quantities of water. Under these circumstances, the technology of concentration offers many advantages.

In chemistry, concentration, as a state, may be defined as “the abundance of a constituent divided by the total volume of a mixture” and can be mathematically explained in four types i.e. mass concentration, volume concentration, molar concentration and number concentration. Generally, the term concentration can be applied to any mixture (solid or liquid) but most frequently it refers to the presence of solutes in solvents. Mass concentration is defined as mass/volume (m/V) of mixture and represented in kg/m³, volume concentration as volume of a constituent divided by the volume of all constituents of the mixture (v/V) and represented in m³/m³, molar concentration as moles of a constituent divided by the volume of all constituents of the mixture (n/V) and represented in mol/m³, while, number concentration is defined as the number of entities of a constituent in a mixture divided by the volume of the mixture (N/V) represented in 1/m³.

In food technology or fruit juice industry in particular, concentration refers to a process of separation of water (or any other solvent) from the solids of the pulp, juice, extract by making use of any of the three basic methods i.e. evaporation, freezing and membrane technology. Pulps, juices and extracts are the basic material used for preparation of various types of processed products. But due to their bulk and presence of large quantities of water they are difficult to store and transport. Concentration of juices, not only provides microbial stability, but also reduces the costs of packaging, transportation and storage by reducing the bulk of the material. Concentrated juice, contains far less water than normal, or “not-from-concentrate” forms of juice.

Abstract

Tremendous changes in lifestyle, eating habits and shifting rural habitations are causing an irreversible change that is leading to manifold multiplication of health problems and these health issues have attracted the attention of every segment of the society in the recent past. Today foods are not intended to only satisfy hunger and to provide necessary nutrients for humans but also to prevent nutrition-related diseases and improve physical and mental well-being of the consumers. Due to increasing control over nutrition and health, consumers are becoming more proactive towards their health. In this regard, functional foods play an outstanding role and they are gaining public acceptance and there is great scope for value-added as well as health promoting food products in developing countries. Various terms have used for functional foods throughout the world such as designer foods, medicinal foods, nutraceuticals, therapeutic foods, superfoods, foodiceuticals, and medifoods. People are interested in foods which boost immune system, reduce the risk of diseases and improve health. The increasing demand of such foods can be explained by the increasing cost of healthcare, the steady increase in life expectancy, and the desire of older people for improved quality of their later years. Typically, a food marketed as functional contains added, technologically developed ingredients with a specific health benefit. These range of products cannot be truly classified as ‘food’ and a new hybrid term between nutrients and pharmaceuticals, ‘nutraceuticals’, has been coined to designate them. The development of functional foods involves the application of various food processing techniques such as microencapsulation of functional ingredients for controlled release, nanotechnology for the development of nanostructured (or nanotextured) food ingredients and delivery systems for nutrients and supplements etc. Inclusion of probiotic bacteria and probiotic supplements in various food systems has also become very popular and this is becoming a very vital sector in functional food market. Systematic RandD efforts are, therefore, required to develop health promoting foods for all segments of the society at affordable cost. Prior to promoting the developed health foods, it is of utmost importance to conduct clinical trials to ascertain safety and efficacy, and also establish appropriate regulatory framework for their distribution to masses. All these issues have been discussed in this paper and recommendations were drawn to formulate future research.

Concept of Entrepreneurship

Entrepreneurship can be defined as the propensity of mind to take calculated risks with confidence to achieve a pre-determined business or industrial objectives. That points out the risk-taking ability coupled with decision making. The word ‘entrepreneurship’ typically means to undertake. It owes its origin to the western societies. But even in the west, it has undergone changes from time to time. In the early 16th century, the term was used to denote army leaders. In the 18th century, it was used to denote a dealer who buys and sells goods at uncertain prices. Towards 1961, Schumpeter, used the term innovator, for an entrepreneur. Two centuries before, the concept of entrepreneurship was shady. It is only in the recent years that entrepreneurship has been recognized widely all over the world like in USA, Germany, Japan and in the developing countries like ours. Gunnar Myrdal rightly pointed out that Asian societies lack entrepreneurship not because they lack money or raw materials but because of their attitudes. Till recently, in the west, the entrepreneurship is mainly an attribute of an efficient manager. But the success achieved by entrepreneurs in developing countries demolishes the contention that entrepreneur is a rare animal and an elusive character. In India the definition of an entrepreneur being the one who undertakes to organize, own and run a business has been accepted in a National Seminar on entrepreneurship organized in Delhi in 1975. Still there has been no consensus on the definition of entrepreneurship and qualities of entrepreneurship.

Introduction
Understanding the concepts of technology transfer, licensing, and commercialization is crucial as it plays an important role in understanding how scientific discoveries leads to generation of new technologies further making them the impactful solutions that benefit industries and society. In the context of Indian HEIs, this especially important because a large volume of impactful research often remains underutilized due to limited commercialization channels. This chapter explains the terminology, essential components of technology transfer, outlines its significance for the innovation ecosystem. It also outlines the evolution of India’s technology transfer ecosystem, and emphasizes while understanding its potential to boost India’s economy, encourage entrepreneurship, and strengthen global competitiveness. From initial idea to a market-ready product is complex and multiphased process. The stepwise process is shown in Figure 1. It highlights a structured pathway consisting of five core phases: Idea/Concept, Technology development, Intellectual Property (IP) rights, Technology transfer, and Technology commercialisation.
Phase 1: Idea/Concept stage
This process of technology transfer starts with the Idea/Concept phase, where an invention is created. Each phase plays an important role in transforming raw scientific knowledge into innovative solutions that benefit society and generate economic value. In this phase breakthrough ideas emerge, within labs. Researchers explore and develop initial proof-of-concept or prototypes to validate their ideas. At this stage, the focus is primarily on knowledge creation rather than commercialization. This pathway of technology transition is summarized in Figure 1.

a) A Key GDP Contributor: Dairy and Livestock sector form the backbone of agriculture with 28 per cent contribution in GDP and the progress in this sector is dependent on innovative measures to increase the value for farmers as well as customers.

b) Doubling Farmer’s Income : Doubling Farmer’s Income by 2022 can be achieved by improving crop and livestock productivity, efficiency to utilize resources, increased intensity of cultivation and diversification in high value cash crops, processing and value addition of food and animal products. This price realization can be assured through market reforms and efficient market linkages.

c) Unorganised sector – a challenge : The Indian dairy sector is still characterized by strong presence of unorganized sector. Apart from the Cooperative dairy sector, in the last few years there has been a considerable growth in Private Dairy sector and Milk Producers Organization like Maahi in Gujarat. If small dairy farmers are provided with sufficient ‘value addition’ training and support, they can increase their income considerably.

d) Value addition : Further, the milk processing plants can also go for value addition and innovation and in turn pay remunerative prices to milk producers.

Food preservation has evolved from traditional household practices to an interdisciplinary field incorporating microbiology, biochemistry, engineering, biotechnology, packaging, nanotechnology and digital intelligence. The book demonstrates that food stability can increasingly be achieved without excessive reliance on synthetic chemical preservatives. Effective preservation requires control of microbial growth, enzyme activity, oxidation, moisture, temperature and environmental exposure while protecting sensory and nutritional quality. Traditional practices remain scientifically valuable, while thermal, non-thermal, biological, packaging and digital technologies offer new possibilities. Future food systems will depend on carefully designed combinations of these approaches to improve safety, shelf life, sustainability, traceability and consumer acceptance while overcoming cost, regulatory and scalability challenges.

For looking into the biosafety in research laboratories, agriculture and other food producing industries it is important to look into the numerous strains of lactic acid bacteria that are associated with food systems and are capable of producing bacteriocin or antibacterial proteins with activity against foodborne pathogens such as Listeria monocytogens, Staphylococcus aureus and Clostridium botulinum. Recently considerable attention has been given on the identification of these proteins and their biochemical properties including spectrum of activity, production conditions, purification procedures, aminoacid composition and mode of action. Advances in genetic engineering have facilitated the characterization of proteins at genetic level, providing information about protein synthesis, structure and cloning of bacteriocin genes into other organism. One problem in the use of bacteriocin in their applications as bio-preservatives is the emergence of resistant population. The understanding on the mechanism of resistance to bacteriocins is limited which limits the application in biopreservation. Much of the work on bacteriocin has been done under controlled laboratory conditions without the presence of adventitious microbial population. More research is needed to determine the efficacy of bacteriocin producing organisms and bacteriocins which are stable under commercial conditions. Foodborne illness is a major international problem and an important cause of reduced economic growth. The contamination of the food supply with the pathogens and its persistence, growth, multiplication and/or toxin production

A sustainable and healthy food system is one which can provide food and nutrition security for all, in an economical way which is socially and environmentally sound for future generations. Underutilized indigenous and traditional crops can support and strengthen the existing food system, as they are in particular economical and friendly with the environment. Several underutilized indigenous and traditional crops are nutrient dense and adapted to marginal conditions, suggesting that they could be used to champion sustainable and resilient agriculture and food systems for smallholder farmers residing in these environments. The mainstreaming of underutilized indigenous and traditional crops and foods should be recognized for their attributes to make them desirable and to conserve them. In this regard, the fact that value chains for underutilized indigenous and traditional crops are poorly developed at present has created many opportunities to diversify the current food systems. This will create a new employment, market and distribution opportunities.It will also help to combat poverty. It will be if the smallholder farmers and women in rural areas are given the opportunity to utilize underutilized indigenous and traditional crops and re-enter the manistream system. A significant role which is played by the women for the production and conservation of underutilized indigenous and traditional crops offers opportunities for women empowerment through their inclusion in the food system. Promotion of gender equality and empowerment of women is directly linked for strengthening the sustainable food systems that can fight hunger and malnutrition and improve the lives and livelihoods of rural populations. The mainstreaming of underutilized indigenous and traditional crops into the food system would support women to diversify in a sustainable way, feed their own households and to provide nutritious food into the local markets. Women entrepreneurship in economic development of any nation has been recognised for its significant contribution. The women folk can be considered as backbone of any nation. Now time has come for women empowerment. In rural Odisha, women not only play an important role for agricultural development but also plays significant role in allied agricultural sector such as dairy, fishery, poultry, mushroom production etc. In Indian condition dairy has been considered as “Rural Banking” as it is practiced mostly by majority of the marginal, small and landless farm families for their sustenance and livelihood. The role of rural women for animal husbandry is of paramount importance. In this sector they are managers as well as decision makers. Women do more than 80% dairy operation like cleaning, feeding, milking, marketing of milk and milk products. The state and central government initiate several scheme, programmes and projects for empowerment of women through various micro enterprises including dairy. Against this background a study was undertaken to identify the constraint faced by women entrepreneur in dairy sector in Khordha district of Odisha.

Sanitation and hygiene are equally important in preventing contamination and pest issues. The warehouse should be thoroughly cleaned to remove any dust, dirt, or residues that could harbor pests or mold. All surfaces, including walls, floors, and storage bins, should be disinfected regularly. Proper waste disposal systems should be in place, and areas where food products are stored should be kept free from garbage or organic waste that could attract pests. Ensuring a clean and well-maintained warehouse helps preserve the quality and safety of stored goods.

India’s rural economy has benefited greatly from the dairy sector. It has played a significant role in bringing about socioeconomic change. India’s dairy industry has undergone significant change as a result of the White Revolution. The “White Revolution” can be credited with increasing milk availability and providing rural India with a stable source of employment and income. The business has drastically changed to meet India’s increasing demand for milk and milk products. India is currently the world’s greatest producer of milk. The Operation Flood Program is credited with this title. The dairy market in India is projected to increase at a compound annual growth rate (CAGR) of 6.61% from 2024 to 2029, from an estimated US$26.11 billion in 2024 to US$35.96 billion by 2029 (Indus Food, 2024). With over 8 crore farmers employed and a 5% national GDP contribution, the dairy industry in India is vital to the country’s economy. With around 25% of the world’s milk supply and a massive livestock population of 536.76 million animals, it tops the world in milk production. With major markets in the United Arab Emirates, Saudi Arabia, the United States, Singapore, and Bhutan, India exports approximately 63,738.47 metric tonnes of dairy products in 2023–2024, generating US$ 272.64 million.

Microbial contamination sources: Foods may be contaminated by microorganisms at any time during harvest, storage, processing, distribution, handling, or preparation. The primary sources of microbial contamination are soil, air, animal feed, animal hides and intestines, plant surfaces, sewage, and food processing machinery or utensils. Since most foods either carry or eventually acquire bacteria, molds, or yeasts, microorganisms are the major causes of food spoilage. The increased load of microorganisms leads to rapid spoilage.

Organisms: Bacteria and fungi (yeasts and molds) are the principal types of microorganisms that cause food spoilage and food- borne illnesses. The typical microorganisms that cause food spoilage are bacteria (e.g., Pseudomonas), yeasts (e.g., Candida), and molds (e.g., Rhizopus). The growth of microorganisms in the food will increase the load of microorganisms, and the heavier load will add to the difficulty of preventing spoilage and may influence the kind of spoilage to be anticipated.

Food spoilage may be defined as any change that renders food unfit for human consumption. These changes may be caused by various factors, including contamination by microorganisms, infestation by insects, or degradation by endogenous enzymes (those present naturally in the food). In addition, physical and chemical changes, such as the tearing of plant or animal tissues or the oxidation of certain constituents of food, may promote food spoilage. Foods obtained from plant or animal sources begin to spoil soon after harvest or slaughter. The enzymes contained in the cells of plant and animal tissues may be released as a result of any mechanical damage inflicted during postharvest handling. These enzymes begin to break down the cellular material. The chemical reactions catalyzed by the enzymes result in the degradation of food quality, such as the development of off- flavours, the deterioration of texture, and the loss of nutrients. The enzymatic changes in foods are desirable to some extent as in the case of ripening of fruits, but continued enzymatic activity beyond an optimum point becomes food deterioration due to rotting. The native enzymes may be inactivated by heat, radiation or by the use of specific chemicals.

Tea as a Beverage

Tea is the most popular beverage consumed in the world after water. All types of teas including black. green, oolong, white and pu-erh tea are mainly made from the buds and young leaves of tea plants, Camellia sinensis (L.) O. Kuntze belongs to the family Theaceae [1]. Depending on the different processing techniques of tea leaves, tea types are categorized as “Green Tea” (unfermented), “Black Tea” (fully fermented), “Oolong Tea” (partially fermented), “Pu-ErhTea” (post fermented) and white tea (unfermented) [2]. The manufacturing process for these different types of teas mainly differ in the degree of enzymatic oxidation (fermentation) process [1].

Introduction

Coffee is a beverage made from the roasted and ground seeds of the African tropical evergreen coffee plant. Coffee is one of the world’s three most popular beverages (together with water and tea), as well as one of the most profitable international commodities, and it is the world’s second most marketed product after petroleum (Myhrvold, 2021).Coffee is a popular beverage that is enjoyed around the world for its taste, health benefits, and ability to enhance physical performance (Simkin, 2008).

16.1. CANNED FOODS-PRESERVATION

Canning is a method of preserving food from spoilage by storing it in containers that are hermetically sealed and then sterilized by heat. The process was invented after prolonged research by Nicolas Appert of France in 1809, in response to a call by his government for a means of preserving food for army and navy use. Appert’s method consisted of tightly sealing food inside a bottle or jar, heating it to a certain temperature, and maintaining the heat for a certain period, after which the container was kept sealed until use. It was 50 years before Louis Pasteur was able to explain why the food so treated did not spoil: the heat killed the microorganisms in the food, and the sealing kept other microorganisms from entering the jar. Samuel C. Prescott and William Underwood of the United States set canning on a scientific basis by describing specific time-temperature heating requirements for sterilizing canned foods.

Most vegetables, fruits, meat and dairy products, and processed foods are stored in tin cans, but soft drinks and many other beverages are now commonly stored in aluminum cans, which are lighter and do not rust. Aluminum cans are made by impact extrusion; the body of the can is punched out in one piece from a single aluminum sheet by a stamping die. This seamless piece, which has a rounded bottom, is then capped with a second piece as its lid. The tabs used in pop- top cans are also made of aluminum. Bimetal cans are made of aluminum bodies and steel lids.

Canneries are usually located close to the growing areas of the product to be packed, since it is desirable to can foods as quickly as possible after harvesting. The canning process itself consists of several stages: cleaning and further preparing the raw food material; blanching it; filling the containers, usually under a vacuum; closing and sealing the containers; sterilizing the canned products; and labeling and warehousing the finished goods. Cleaning usually involves passing the raw food through tanks of water or under high- pressure water sprays, after which vegetable or other products are cut, peeled, cored, sliced, graded, soaked, pureed, and so on. Almost all vegetables and some fruits require blanching by immersion in hot water or steam; this process softens the vegetable tissues and makes them pliable enough to be packed tightly, while also serving to inactivate enzymes that can cause undesirable changes in the food before canning. Blanching also serves as an additional or final cleansing operation.

10.1 CEREALS AND CEREAL PRODUCTS

CONTAMINATION: The sources of contamination in cereals and cereal products are soil, insects, air, etc. Most of the microorganisms are removed with the outer portions of the grain during milling. The bleaching agents used during milling also reduce numbers of microorganisms. The bacteria in wheat flour include Bacillus, Micrococcus, Flavobacterium. Mold spores are chiefly of Aspergillus spp and Penicillium spp and in addition Alternaria, Cladosporium and other genera are found. The numbers of microbes in cereals and cereal products vary widely from few hundred per gram to million. Corn meal contains several hundred to several thousand bacteria and mold per gram.

14.1. EGGS

India is the third largest producer of eggs. Fresh eggs are gathered on automatic collection belts at the farm and stored in a cooler at about 7°C. The eggs are then delivered to a central processing plant, where they are washed, sanitized, and graded. Grading involves the sorting of eggs into size and quality categories using automated machines. Flash candling (passing the eggs over a strong light source) detects any abnormalities such as cracked eggs and eggs containing bloodspots or other defects. Higher-grade eggs have a thick, upstanding white, an oval yolk, and a clean, smooth, unbroken shell.

14.1.1. Eggs Contamination

More than 90 percent of all eggs are free of contamination at the time they are laid; contamination with Salmonella bacteria and with certain spoilage organisms occurs essentially afterward. They become contaminated by faecal matter from the hen, by the lining of nest, by handling, by wash water and packing materials. The total number of microorganisms per shell of a hen’s egg was found to range from 100 to 10,000,000 with a mean of about 100,000. Proper washing and sanitizing of eggs eliminates most Salmonella and spoilage organisms deposited on the shell. The organism Salmonella enteritidis, a common cause of gastroenteritis (a form of food poisoning), has been found to be transferred through the hen ovary in fewer than 1 percent of all eggs produced. Ovarian- transferred S. enteritidis can be controlled by thorough cooking of eggs (i.e., until there are no runny whites or yolk).

13.1. CONTAMINATION

MICROFLORA: The flora of living fish depends upon the microbial contents of the waters in which they live. The slime in the outer surface of the fish contain bacteria of the genera: Pseudomonas, Alcaligenes, Micrococcus, Flavobacterium, Corynebacetrium, Bacillus, Sarcina, Serratia and Vibrio. The same species of bacteria are found in shrimps, crabs, lobsters and similar sea foods. Oysters and Shell fish that pass large amount of water through their bodies, pick-up soil and water microorganisms in this way including human pathogens. Common spoilage microorganisms of fish include species of Pseudomonas, Moraxella, and Acinetobacter, found mainly in marine fish, and Bacillus and Micrococcus, found in freshwater fish. Fish may also contain pathogenic (disease-causing) microorganisms such as Salmonella and Escherichia coli. Pathogenic contamination is of special concern with mollusks because they are often eaten raw and as whole animals.

SOURCES: Boats, boxes, bins, fish houses and fishermen are the sources of contamination of these bacteria. The bacterial population ranges from few hundred to few million per square centimeter. Because of their soft tissues and aquatic environment, fish are extremely susceptible to microbial contamination. At the time of harvest, fish carry a high microbial load on the surface of their skin, in their intestinal tract, and in their gills. The type and number of microorganisms that live in fish vary according to the season, the species, and the natural habitat. Additional contamination may occur during the harvesting, handling, or processing of the fish. Harvested fish must be immediately stored in a low-temperature environment such as ice or refrigerated seawater. This chilling process slows the growth of microorganisms that live in fish and inhibits the activity of enzymes. Because fish have a lower body temperature, softer texture, and less connective tissue than land animals, they are much more susceptible to microbial contamination and structural degradation. If immediate chilling is not possible, then the fish must generally be sold and eaten on the day of the harvest.

11.1. FRUITS-Maturation, Ripening and Storage

Fruits are natural foods containing substantial quantities of essential nutrients and the best sources of minerals like sodium, potassium and magnesium, vitamins (antioxidants), such as vitamin A, C and enzymes. They are rich in fructose and water. Fruits are living biological entities that perform a number of metabolic functions. Two functions of particular importance in fruit processing are respiration (the breaking down of carbohydrates, giving off carbon dioxide and heat) and transpiration (the giving off of moisture). Senescence is the period when chemical synthesizing pathways give way to degradative processes, leading to aging and death of tissue. Fruit ripening is thus the result of many complex changes, some interactive but many independent of one another. Once the fruit is harvested, respiration and transpiration continue, but only for as long as the fruit can draw on its own food reserves and moisture. It is this limited ability to continue vital metabolic functions that defines fruit as perishable.

CONTAMINATION

The healthy inner flesh of meat contains few or no microorganisms, although they have been found in lymph nodes, bone marrow and intestine. Staphylococcus, Streptococcus, Clostridium and Salmonella have been isolated from lymph nodes of red meat animals. During slaughtering the lymph nodes are removed from edible parts. The important contamination, however comes from external sources during bleeding, handling and processing. During bleeding, skinning and cutting the main sources of microorganisms are from the exterior of the animal- hide, hoof and hair and the intestinal tract. The exterior of the animal harbours large number and many kinds of microorganisms from soil, water, feed and manure as well as its natural surface flora.

Knives, cloths, air and hands and clothing of workers can serve as intermediate sources of contamination. During handling and processing the contamination can come from containers, air, other contaminated meat, equipments and personnel.

Molds that grow on the surface of the meat include the species of Cladosporium, Sporotrichum, Geotrichum, Mucor, Monilia, Penicillium and Alternaria. The important bacteria found in meat are Staphylococcus, Sarcina, Streptococcus, Clostridium, Leuconostoc, Lactobacillus, Proteus, Flavobacterium, Bacillus, Streptomyces, Escherichia and Salmonella.

15.1 CONTAMINATION

Milk is sterile at secretion in the udder, but contaminated by bacteria when it leaves the udder of a healthy cow. Milk is subject to contamination from the animal and adjacent areas. Bacteria found in manure, soil and water may enter milk from these sources. Certain diseases may be transmitted through milk, from a cow. It is essential that cows producing milk should be free from any contagious or infectious disease. Bovine tuberculosis comes from consumption of milk of tuberculous cows. Tuberculosis, brucellosis, mastitis and actinomycosis are the human disease transmitted through milk. Sources of Microbial contamination: Milk contains relatively few bacteria when it leaves the udder of a healthy cow.
