Abstract

Most dryers operate at low thermal efficiency. The development of models and control systems offers an opportunity to improve dryer operation and efficiency. Dryer control is very important and with deeper understanding of the drying concept, new “smart” dryers can be made more reliable and more cost-effective than classical dryers. This chapter will provide an overview of necessity of control and safety measure in food drying system, and terminology related with drying control system. Different control strategy includes conventional and advanced techniques implemented in drying operation are reviewed  here and simple outline of intelligence control system in drying technology are briefly described in succeeding section. Various hazards in drying process and risk and safety management will also be discussed.

Introduction

Perishable nature of horticultural produce is a major factor contributing in high post-harvest losses. The metabolic processes such as respiration, transpiration, and ethylene production remain active after the harvesting of produce, which drive ripening and senescence Fig. 1. Thus, an effective post-harvest handling is crucial to delay these changes. The rate of these processes depends on the produce’s physiological characteristics, composition, and storage conditions like temperature and humidity. Low-temperature storage is the simplest and most efficient method to slow down deterioration Escobedo-Avellaneda and Welti-Chanes, 2016. Combining low temperatures with methods that limit oxygen exposure, which fuels many enzymatic reactions, further extends shelf life and maintains food quality. Reduced oxygen levels decrease respiration and the activity of enzymes like polyphenol oxidase and peroxidase.

Conversion of muscle to meat is a complex process in which several physical and chemical changes takes place over a period of several hours or even days. The major changes which take place during this process include fall in muscle pH and temperature as well as muscle shortening which further leads to proteolysis or ageing. These changes during conversion of muscles to meat are variable and have great effect on meat quality (tenderness, juiciness, flavour, colour etc.) and also on certain processing characteristics like emulsification, binding properties and yield of the products. To know this complex process it is necessary to understand the process of energy production and metabolic pathway shifting in live animals.

Pre Slaughter

In the living animal, aerobic metabolism is used to obtain energy. The source of energy at this stage is either free fatty acids or blood glucose or muscle glycogen. In this process total 38 ATP molecules are produced from single glucose or glycogen molecule by the complex processes known as glycolysis, oxidative decarboxylation and oxidative phosphorylation. However, under stressful situations, anaerobic metabolism may be used and lactic acid is produced. Lactic acid is usually transported from the muscles to the liver, where it is re-synthesized into glucose and glycogen, or to the heart, where it is metabolized to carbon dioxide and water.

ABSTRACT

The improper disposal of food waste poses an environmental threat. The management of food waste in a sustainable way is always a challenge. Food waste is generated at various stages starting from food production till consumption. The cooked food waste generated due to various reasons leads not only to a loss of the food produced but also the water and energy used to cook it. This cooked food leftover can be served to the needy people or if not possible, can be processed further. This chapter focuses on various technological options for the management of cooked food waste in a sustainable way.

1.1. Introduction
The terms ‘counselling’ and ‘health promotion’ complement each other when it becomes a matter of an individual’s health. Health promotion is a part of behavioural social science that aims to change the systemic strategies adopted by the individual or group or by the mass community for the betterment of their health which can be achieved by talk therapy known as counselling. In the 21st century, from childhood to adulthood, all people are in a ‘rat race’ for their careers and necessities, which is one of the main reasons for stress generation. Not only that, chemical substances consumed by different food ingredients as food additives, preservatives, etc. but also induce oxidative stress and damage the functional activity of cells, tissues, organs, and systems. This ‘stress’ is a major culprit not only for the deterioration of physical health but also psychological health. Such stress imposition in daily life impairs normal physiological functions, skills, performance, and productivity. Unhealthy food, life, and work styles are also linked to the onset of pathophysiological complications that counselling and health promotion are required to overcome. Besides this, for sportsmen, pregnant women, lactating mothers, and growing children, nutritional counselling and health promotion are indisputable. For disease prevention and early recovery from disease, dietary counselling plays an immense role.
1.2. Counselling
Counselling is an intermittent, interpersonal interviewing process where the counsellor gives advice or suggestions to the client but never gives any direction. Counsellors assist the client in thinking, analysing, and acting to improve their insight power. The counsellor focuses on both the positive and negative sides of a particular event and allows the client to think and rethink its acceptability and unacceptability.

Definition

It is one of the important portion of milk which forms a fatty layer on top of milk when left un-disturbed. It is a prime component of milk and comprises mainly of milk fat. It may be defined as “that portion of milk which is rich in milk fat” meaning portion of milk into which larger portion of milk fat has been gathered.  According to FSSAI, 2011 Malai and Cream are defined as –

Malai means the product rich in butter fat prepared by boiling and cooling cow or buffalo milk or a combination thereof. It shall contain not less than 25.0 per cent milk fat.

16.1 Introduction
The fluid product “Cream” is defined by FSSAI standards as an emulsion of fat-in-skimmed milk that is comparatively rich in fat. It is derived by physical separation from cow milk, buffalo milk, or milk of any other species as defined under this regulation, or a mixture thereof. Cream, with the exception of sterilized variants, is composed of a minimum of 25% milk fat and is derived from cow or buffalo milk or a combination of both. It is a high-energy source that is abundant in fat and fat-soluble vitamins A, D, E, and K. The vitamin content is contingent upon the fat percentage in the cream.
16.2 Classification
Cream may be broadly classified into Market cream (direct consumption) and Manufacturing cream (manufacture of dairy products). The three different types of cream are:
i. Table cream/Light cream contains 20-25% milk fat.
ii. Coffee cream/ Whipping cream Contains 30-40 % milk fat, and
iii. Heavy cream/Plastic cream contains 65-85 % milk fat.
As per FSSAI Standards, Cream may be labeled according to milk fat content (m/m) along with product name as specified in item 1 of this Standard, as follows:
i. Low fat cream: Minimum 10 per cent. and less than 40 per cent.;
ii. Medium fat cream: Minimum 40 per cent. and less than 60 per cent.;
iii. High fat cream: Minimum 60 per cent.

Butter is one of the leading milk product in developed countries of the world. It serves as a balance wheel of dairy industry. Surplus milk is generally converted into butter to be used during the times of scarcity. It is an article of commerce and a sign if wealth. Butter is a fat concentrate, which is obtained by churning cream, gathering the fat into a compact mass and then working it for proper distribution of moisture and salt. The art of butter making has a long history. The manufacture of butter was confined to colder regions where gravity creaming was successful. The milk was allowed to stand undisturbed for 10-12 hours until layer of cream collects at the top.

Chemically, sugar candies are broadly divided into two groups: crystalline candies and amorphous or non crystallized candies. Crystalline candies are not as hard as crystals of the mineral variety, but derive their name and their texture from their microscopically organized sugar structure, formed through a process of crystallization, which makes them easy to bite or cut into. Fudge, creams, and fondant are examples of crystalline candies. Amorphous candies have a disorganized crystalline structure. They usually have higher sugar concentrations, and the texture may be chewy, hard, or brittle. Hard candies, such as lollipops, caramels, nut brittles and toffees are all examples of amorphous candies, even though some of them are as hard as rocks and resemble crystals in their overall appearance. Crystalline candies are chemically described as having two phases, because the tiny, solid sugar crystals are suspended in a thick liquid solution. These are also called grained candies, because they can have a grainy texture. Amorphous candies are have only one phase, which is either solid or liquid, and do not have a grainy texture, so they may be called ungrained.

Commercially, candies are often divided into three groups, according to the amount of sugar they contain:

Cucurbits form an important and a big group of vegetable crops cultivated extensively in this country. This group consists of a wide range of vegetables, either used as salads (cucumber) or for cooking (all the gourds) or for pickling (cucumber) or as dessert fruits (muskmelon and watermelon) or candied or preserved (ash gourd). They are of tremendous economic importance as food plants.

2.1. Ash Gourd (Benincasa hispida)

Ash gourd (Benincasa hispida L.) belongs to the family Cucurbitaceae. The winter melon, also called white gourd, ash gourd, or “fuzzy melon”, is a vine grown for its very large fruit, eaten as a vegetable when mature. It is the only member of the genus Benincasa. This is a monotypic genus and the only cultivated species is Benincasa hispida (Thunb) Cogn, commonly known as ash gourd or petha. It has a Sanskrit equivalent ‘Kooshmanda’ indicating its antiquity in India.

Originally cultivated in Southeast Asia, the ash gourd is widely grown in China, India and other parts of East Asia. The immature melon has thick white flesh that is sweet when eaten. By maturity, the fruit loses its hairs and develops a waxy coating, giving rise to the name wax gourd, and providing a long shelf life. The ash gourd is known by many other names in India regional wise like komora (Assamese), pethakaddu (Hindi), boodagumbala (Kannada), Kumbalanga (Malayalam), Kohla (Marathi), neer poosanikai (Tamil) and Boodida gummadikaya (Telugu).

Uses

Ash gourd have enormous medicinal properties as it makes a valuable place as a popular natural cure of ailments in traditional medicinal practice. Being low in calories it is an ideal vegetable for diabetic patients and good for weight control. It also acts as a good detoxifying agent.

As per Ayurveda, ash gourd is used to treat epilepsy, asthma, lung diseases, urine retention, internal haemorrhage, and cough. It is said that the fruit juice is also effective in cases of mercury poisoning and snakebite. It could also treat mouth cancer, protecting teeth and gums when a mouth gargle of the juice is done regularly. It is also effective in bleeding of gums. Ash gourd is easily digestible and keeps the body cool. It is a natural blood purifier.

Cultural characteristics of bacteria deal with the appearance of the growth in various liquid and on solid media. The growth characteristics of most of the bacteria are typical of the group or species and help in their identification. The terminology employed to describe various features of bacterial growth are mentioned below.

1. INTRODUCTION

Medicinal plants constitute considerably a large component of natural vegetation. Several of these species are in great demand for domestic consumption as well as for commercial use by the herbal industry. About 800 species are estimated to be in trade with a turnover of Rs.4000 crores per year. This high demand by the herbal industry has put enormous pressure on the wild populations leading to destructive collection of the produce as maximum species of medicinal plants are wild.

A medicinal plant is as any plant which contains substances that can be used for therapeutic purposes or which are precursor for chemo- pharmaceutical synthesis. The medicinal plants are useful as a drug or therapeutic agent, having different medicinal values in form of active ingredient. Medicinal plants may therefore be defined as a group of plants that possess some special properties or virtues which make them important as drugs, therapeutic agents and for medicinal purposes.

Medicines from India are used by about 60 per cent of the world’s population. These are not only used for primary health care not just in rural areas in developing countries, but also in developed countries as well where modern medicines are predominantly used. While the traditional medicines are derived from medicinal plants, the herbal drugs are prepared from medicinal plants only. Use of plants as a source of medicine has been an ancient practice and is an important component of the health care system in India. There are about 45,000 medicinal plant species in India, with concentrated spots in the region of Eastern Himalayas, Western Himalayas, Western Ghats and Andaman & Nicobar Island. India is the largest producer of medicinal herbs and is called the botanical garden of the world. In rural India, 70 per cent of the population depends on the traditional type of medicine, the Ayurveda. Ayurveda and Kabiraji (herbal medicine) are two important forms of alternative medicine that is widely available in India. It is estimated that about 80,000 species of plants are utilized in some form or other by the different systems of Indian medicine. Many herbs and spices are used in Indian cooking, such as onion, garlic, ginger, turmeric, clove, cardamom, cinnamom, cumin, coriander, fenugreek, fennel, ajowan (ajwain), anise, amchur, bay leaf, hing (asafoetida) etc. Ayurvedic medicine uses all of these either in diet or as a medicine.

Pineapple is one of the most economically important fruits in tropical and subtropical regions and gaining popularity to the consumers all over the world. The pineapple plant has many specific morphological, anatomical and physiological characteristics that determine crucial aspects of pineapple crop management, such as water use efficiency, nutrient management, weed management, flower induction etc.

Water Requirements and Irrigation

Determination of water requirements and plant moisture status: Pineapple plant responds well to as much as 5 cm of water per month from rain or irrigation though it is a xerophyte type and is capable of good production under relatively meager water supply. Maintenance of available soil moisture in the root zone areas requires less water for pineapple than for other crops due to lower transpiration rates. Plants achieve this type of adaptability through a process called assuberization, where suberin act as a physical barrier, preventing water loss from the tissues it surrounds.Stomata remains closed as an effect of drought during the entire day. But, whenever the plants are grown with sufficient moisture in well-aerated soils produced well-distributed roots with numerous white root tips. It helps the water use efficiency and carbon f ixation that pineapple shows to drip irrigation. The pineapple leaf is a major water storage organ for the pineapple plant (Malézieux et al., 1993). When the leaves are full of water the cells present in upper mesophyll layer can occupy almost half of its volume. Invery little water-supply, the water in the mesophyll layer is absorbed by the plant. Generally, representative ‘D’-leaves are taken in a group of six to ten leaves and the total thickness is measured and compared with the thickness of fully turgid leaves.

Culture methods employed depend on the purpose for which they are intended. In the laboratory the indications for culture are mainly to

1.Isolate bacteria in pure culture.

2.Demonstrate their properties

3.Obtain sufficient growth for preparation of antigens and for other tests.

4.Type isolates by methods such as bacteriophages and bacteriocin susceptibility.

5.Determine sensitivity to antibiotics

6.Estimate viable counts

7.Maintain stock solution

Introduction

Advances in food preservation methods have supported the journey of food science from that of a cookery science to a fast growing industrial technology. Food preservation knowledge deals with the way to prevent spoilage and maintenance of quality in foods. Spoilage is the deterioration in quality brought about by inherent biochemical and chemical changes, as well as microbial metabolism during food storage. Basic principles of food preservation (Frazier et al., 2008) remains the same, but newer methods for achieving the goal is added through research fuelled by a consumer demand for fresh-like foods with convenience and safety. Scientific information on novel processing methods are beautifully compiled (Cullen et al., 2011; Da-Wen Sun, 2014; Tokuþoðlu and Swanson 2015; Doona, 2018).

In-depth knowledge of physiological activities of micro-organisms in presence of preservation agents is essential for preparation of safe foods with prolonged shelf life. Besides this, it is necessary to understand the effect of food constituents on microbial resistance against inactivation agents, to identify critical dose requirement. This profound knowledge would also help to understand kinetics of microbial inactivation and to develop mathematical models suitable for a realistic design of process parameters. For better appreciation of the following sections, readers are encouraged to have fundamental knowledge in microbiology and food processing. The sections in this chapter cover advanced microbiological knowledge pertaining to the preservation aspects of food.

Genus Annona belonging to the family Annonaceae, contains more than seventy species of woody shrubs and trees, all of which produce aggregate fleshy fruits. Of these only a few produce edible fruits of commercial importance. Of all, Annona squamosa L. is probably the most popular fruit. It is also known as ‘Sitaphal’ or ‘Shariffa’. These can withstand drought better than many other fruit trees. Other species of the genus Annona providing edible fruits are A. reticulata L., A. muricata L., and A. cherimola L.

Custard Apple (Annona squamosa Linn.)

The custard apple, Annona squamosa L., also known as sweet-sop or sugar apple, is almost entirely eaten as a dessert fruit. Its pulp may be mixed with milk to form milk shake or made into ice-cream. The pulp has a pleasant texture and flavour. Several products like -squash, nectar, pulp butter, syrup, jam can be made from the pulp.

Custard apple is native to tropical America (Mexico). It is cultivated in Australia, Brazil, Chile, Egypt, India, Israel, Myanmar, Mexico, Philippines, Spain, Sri Lanka, South Africa, West Indies, USA and Cuba. In India it is popular in Andhra Pradesh, Madhya Pradesh, Tamil Nadu, Karnataka, Maharashtra, Uttar Pradesh, Orissa, Asssam, Bihar and West Bengal.

Cultivars: The cultivars vary in their shape, size, colour and eating quality. Some of the cultivars are Balanagar, Sangareddy Local, Chittorgarh, Barbados, British Guinea, Mammoth, Red Sitaphal, Yellow Sitaphal, Custard Apple Selection-1, Custard Apple Selection -2. Arka Sahan is a hybrid developed by ICAR-IIHR, Bangalore.

Materials Required

Canned product, weighing balance, can cutter, vacuum/pressure guage, seam checking guage, Refractometer / Salometer etc. 

Procedure

    1.    Take a canned product say canned peach.
    2.    Record the weight of the can (A)
    3.    Record the information marked on the label i.e net  weight, date of packing, etc
    4.    Observe the can externally for the concavity of the lid.
    5.    Record the vacuum of the can by using a vacuum guage
    6.    Cut the lid of the can with a can cutter
    7.    Record the head space
    8.    Put all the contents over a sieve and let the liquid drain
    9.    Record the weight of empty can (B) to calculate net contents
    10.    Record the drained weight of the pieces.
    11.    Record whether the liquid is syrup or brine
    12.    Record the TSS of the salometer reading of the liquid (as the case may be)

A cut-out examination is conducted for the evaluation of canned fruit and vegetables and other products for various quality attributes, viz., physical, chemical, sensory, and microbiological attributes. The examination is conducted by following the undermentioned steps: External/physical examination of unopened Can
1. External Appearance of the tin can: Note the external condition of the tin can like dents, rusty spots, scratches, leakage around seams, and the condition of ends. Based on external appearance describe the condition of the tin can by using the following terms:
i. Flat Can: A can where both ends are concave. The vacuum is high enough to maintain the ends concave.
ii. Flipper Can: A can where the vacuum is so low that mechanical shock will produce distortion of one or both ends.
iii. Springer Can: A can in which one end is distorted and the other end is flat and pressure on the convex end will cause the flat end to spring out when pressed.

Dahi: It is the product obtained from pasteurized or boiled milk by souring, natural or by harmless lactic acid or other bacterial culture. It is also called Curd (Plate 209).

Dairy: It is a room, building, or establishment where milk is kept and butter / cheese is made or it is the department of farming / farm that is concerned with the production of milk, butter, and cheese or an establishment for the sale / and distribution of milk and milk products.

Dairy husbandry: It deals with care, breeding, feeding, milking of the diary cattle and the production and sale of the milk. It is the economical management of a dairy, including looking after the dairy cattle breeding and proper disposal or sale of milk and milk products.

Dairy products: These are the milk preparation, including butter, cream, cheese, ghee, yoghurt, pasteurized milk, tonned milk, butter milk etc processed and prepared in dairy. Ice cream and kulfi or sweets are not included in this.

Damage: Damage is a physical spoilage, often a partial deterioration, are subjectively judge and very difficult to measure and usually reported as per cent damage.

Daminozide: It is a growth regulator which is used for red colour development in apple.

1. Introduction

Milk and milk products constitute essential dietary components for a vast majority of the population. India with annual production of more than 135.6 million tonnes has emerged as leading milk producing nation. The per capita per day availability of milk in India is more than 290 g. Buffalo milk accounts for 57% of the total milk produced in India. Ethnic dairy products account for 90% of all dairy products consumed (Aneja et al., 2002). Many health benefits have been attributed to fermented dairy products and probiotic microorganisms (Salminen et al., 1998). The market for functional foods, nutraceuticals, wellness foods and beverages is fast growing. The harmful effects of synthetic drinks have propelled health conscious consumers to go for natural and traditional drinks. In search of better returns, the Indian dairy industry is widening its focus to include traditional milk products, and these are emerging as new profit centres for the organised sector.

Traditional dairy products have several advantages. They require low capital investment and give high profit margin. They are more appealing to the Indian palate. Dahi or curd is the most popular indigenous fermented dairy product. There are numerous references to dahi in vedic literature. The Prevention of Food Adulteration Act (Anon, 1976) describes dahi as a product obtained from pasteurized or boiled milk by souring (natural or otherwise), using harmless lactic acid or other bacterial cultures. Indian dahi and its western counterpart yoghurt differ considerably in terms of cultures used and their bouquet and flavour profiles (Aneja et al., 2002). The major flavor compound in dahi is diacetyl. Dahi made from buffalo milk has a firm body and white glossy appearance, with a cream layer on top. Mixed mesophilic cultures of Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp diacetylactis along with Leuconostoc species are grown together for production of dahi.

Dairy byproducts constitute an important segment of dairy industry. An important criterion in the economic choice of any process is the efficient utilization of byproduct that is produced along with the main product. The main byproducts of dairy industry are skim milk, buttermilk, whey and ghee residue. Each and every component of milk must be judiciously processed into edible form not only to improve the profitability of dairy industry but also to make best use of the unique nutritional value of the precious milk constituents on one hand, and to prevent environmental pollution, on the other. However, dairy plants, particularly in India, are usually confronted with the problem of byproduct utilization, especially that of whey and ghee residue in economical manner.

Skim milk is a byproduct obtained during the manufacture of cream. It is rich in solids-not-fat content and has high nutritional value. In dairy plants, it is mostly utilized either in standardization for the manufacture of main dairy products or preserved by removing moisture in milk powder form. The skim milk when utilized in either of these two forms or consumed as liquid, is not considered a byproduct. It is regarded as a byproduct only when it is either not economically utilized or utilized for derived byproducts, like casein and other related products, co-precipitates, protein hydrolyzates, etc.

Buttermilk is the byproduct obtained during butter manufacture. Sweet cream buttermilk resembles skim milk in gross chemical composition and is usually admixed with bulk of skim milk for further spray drying or even product manufacture in dairy plants. Desi buttermilk, on the other hand, has long been an important domestic beverage in India. It has high nutritive and therapeutic value. It also finds its way in the preparation of a host of culinary dishes such as kadhi, dhokla and idili. Also a number of federations and private plants sell salted and spiced buttermilk in 200 ml pouches.

30.1 Introduction
Every food processing facility, especially those that produce several products, generates trash in various forms. The food products are rich in carbs, proteins, lipids, and mineral salts. During the process of flushing and washing various equipment, nutrients are released into the drainage, promoting the growth of both anaerobic and aerobic bacteria. Consequently, the water that is flushed might have a highly unpleasant smell and could become a challenge for disposal in the municipal sewer system.

30.2 Definition of Waste Management
Waste management encompasses the collection, transportation, processing, recycling or disposal, and oversight of waste materials.

30.3 Types of Wastes in a Food Processing Plants
Waste produced in food processing plants can be categorized based on their form and origin, whether they are avoidable or unavoidable, their value, or their potential for reuse.

30.3.1 Based on the forms: Wastes based on forms can be classified as
1. Solid wastes,
2. Liquid wastes,
3. Oily wastes,
4. Gaseous wastes/water vapors.

Milk processing plants involve processing of raw milk into products like market milk, cheese, butter, ice cream, condensed milk, dried milks and traditional dairy products. The by-products processing includes buttermilk, whey and its derivatives. Dairy effluents contain dissolved sugar, protein, fat and minerals. Spills and leaks of products or by-products, residual milk or milk products in piping and equipment before cleaning, wash solutions from equipment and floors, condensate from evaporation processes and cheese trimmings are some of the sources of dairy effluents in a dairy plant. The key parameters are the biological oxygen demand (BOD), chemical oxygen demand (COD), total suspended solids, total dissolved solids etc. Common dairy waste techniques include grease traps, oil water separators for separation of floatable solids, equalization tanks. Biological treatment consists of aerobic and anaerobic process.

Introduction
Demand of dairy products is on the rise in India. India‘s demand forecast for milk and milk products is more than the current supply of these products. To meet this demand entrepreneurship initiatives are need of the hour. Further, younger generations of India are more interested in commercial dairy farming rather than subsistence based farming. Therefore, scientific as well as commercial dairy entrepreneurial training to farmers about advanced technology used in breeding, feeding, housing and healthcare is essential.

a. Barriers for Entrepreneurship in dairy

An average dairy entrepreneur faces several barriers to start a new enterprise. Some of them are as under

    1.    Lack of financial support: A major stumbling block for many dairy farmers to expand production or diversify into new high value enterprises is lack of access to finance. Farmers who are starting new enterprises often face difficulty raising investment capital.

Dairy Industry in India
Milk holds a deeply symbolic place in Indian culture, far beyond its role as a mere food item. It is intricately woven into the cultural and historical identity of the nation, with the dairy industry serving as a cornerstone of India’s economy. The sector is a driving force behind rural development providing a crucial pathway to prosperity for millions of small-scale farmers. It plays a significant role in alleviating poverty and generating employment opportunities. The dairy sector by empowering farmers, developing modern infrastructure embracing technological advancements, and promoting sustainable practices, fostering widespread socio-economic progress in rural India. In the 1920s, modern milk processing and marketing technologies were introduced in India. The National Dairy Development Board (NDDB; founded in 1965), implemented Operation Flood (1970-96) to modernize the dairy sector through cooperatives. This led to the rise of dairy cooperatives countering the exploitation by private milk plants. The cooperatives followed the Anand model, a three-tier structure comprising village-level societies (producers), district-level unions (milk collection and processing), and state-level federations (marketing). Originating in Anand, Gujarat in 1946, the model was later adopted nationwide. The progress termed as White Revolution transformed India from a nation struggling with milk shortages into the world’s largest producer and consumer of milk. By 1997, India became the global leader in milk production with a volume of 70.9 million tons, surpassing the United States (FAO data rearranged by Our World in Data). Further in the year 2014, for the first time, it beat the entire European Union. Since 1950, India’s milk production has seen tremendous growth, rising from 17 million tonnes in 1950-51 to 230.58 million tonnes in 2022-23. The per capita availability of milk increased from 124 g/day in 1950-51 (PIB 2022) to 459 g/day in India during.

Introduction
 
Dairy ingredients are of significant importance in the formulation of many food products. Additionally, the incorporation of dairy ingredients, comprehensively recognized by the consumer as “natural” intensifies the odds of success of packaged foods and adds functional properties of the dairy ingredients in the targeted product. Dairy ingredients can be extracted from fluid milk in the form of cream, butter, condensed milk, dry milk, cheese, and whey products [1]. They provide beneficial functionality to foods, such as delivery of key nutrients, water management, fat-holding capacity, emulsification capability, viscosity creation, gel formation, and foam generation apart from providing desirable attributes of texture and flavour. Various ingredients and claims associated with dairy foods are shown in Table 3.1.

Milk is nutritious and essential food for human beings and also serve as good medium for microbial growth and contamination. Milk is a single, most nearly complete, natural food. Primarily it is meant for nourishing the newborns but man has exploited it for human consumption since long. Today milk has become indispensable integral component of our diet. About half the milk produced is consumed as fresh milk, the rest going into a variety of products including evaporated and condensed milk, dried milk powder, butter, cheese, malted milk, ice cream, yoghurt, lactose and casein. Milk is very important from a nutritional standpoint since it contained all the essential food constituents (carbohydrate-lactose, protein-casein, fat-butter, minerals- calcium, potassium and vitamins- A, B, C, D, E, and K) required in human diet in about the proper proportions. India is the second largest producer of milk in the world. India has exhibited unprecedented rate of growth in dairy development in last 30 years mainly due to sustained efforts of dairy technologists in Operation flood Programme introduced by the National Dairy Development Board. Dairy microbiology deals with aspects like shelf life and spoilage microbes, public health significance and food borne pathogens, and production of fermented dairy products.

DAIRY BUSINESS

Most ambitious young men at some time or another are likely to develop an interest in going into business for themselves. This is prompted not only by the thought that a person owning his own business is more independent but also by the hope of increasing personal income. However, when these same young men look about them and see the general existence of “big business” in practically all lines of endeavour, they often lose courage and decide to remain as workers with some company where they can enjoy a certain degree of security. 
The general condition is an important factor in determining the success of new business enterprises. Similarly, innovations like the creation of new products or the development of new methods of merchandising often gives rise to opportunities for a new business enterprise. The introduction of “Softy” ice cream and other soft-served frozen products made it possible for several hundred small businesses to get established in our country. The advent of single- service paper container was the spark that started several milk-plant operations which later grew into companies of considerable size. Ironically, the paper milk container also spelled the doom for many older independent plants that could not or did not adjust soon enough to this new way of packaging. The chocolate-coated ice-cream bar idea started a number of new enterprises which grew from small companies going to concerns of considerable size. Vending machines made it possible for many small companies to get started selling milk, ice cream, candy and lassi etc. 

Introduction

The dairy industry is a cornerstone of worldwide agricultural economies, underpinning nutrition, employment, and rural development. India stands out among nations with thriving dairy sectors, accounting for approximately 23% of global milk production (Prasad et al., 2023). With advent of Operation Flood in the late 1970s, India’s dairy industry has undergone transformative changes. This movement revolutionised milk production, rural income, and the organisation of cooperatives. The Indian dairy sector is still unorganized and only 18-20 per cent of the total milk produced is handled by organized sector (Gowda, 2023). There is rising trend of value addition along with rising demand of processed dairy products in India. These changes underscore the importance of effective dairy plant management systems, where strategic oversight of milk procurement, processing, and product manufacturing ensures quality, efficiency, and sustainability.

The GOI is pushing to strengthen infrastructure for the production of quality milk, as well as for procurement, processing, and marketing of milk and milk products through the following Dairy Development Schemes:

6.1. Dairy Entrepreneurship Development Scheme (DEDS)

Dairy Entrepreneurship Development Scheme (DEDS) was started in September 2010. This scheme is being implemented through NABARD which provides financial assistance to commercially bankable projects with loans from Commercial, Cooperative, Urban and Rural banks.

Objective of the scheme

To generate self-employment and provide infrastructure for the dairy sector, to set up modern dairy farms and infrastructure for the production of clean milk, to encourage heifer calf rearing for conservation and development of good breeding stock, to bring structural changes in the unorganized sector so that initial processing of milk can be taken up at the village level, to upgrade traditional technology to handle milk on a commercial scale, to provide value addition to milk through processing and production of milk products.

1.1. Global Dairy Scenario

Global milk production is forecast at 852 million tonnes in 2019, an increase of 1.4 per cent from 2018 (DAHD, 2019) – a smaller rate of growth, reflecting downward revisions made for India and the European Union. Much of the anticipated output expansion will originate in India, Pakistan, China, the European Union, and Brazil, partially offset by declines in some countries including Australia, Colombia, and Argentina. In India and Pakistan, herd expansions drive output growth, while in China, farm efficiency improvements underpin higher growth. The output is increasing in the European Union, although slowly as dry weather limited the supply of milk during the summer, whilst rising dairy herds and stable milk prices are supporting higher production in Brazil. By contrast, the output may decline in Australia and Colombia due to dry weather, whereas in Argentina, rising feed costs and restrained consumer demand may dampen production. Elsewhere, in the United States, higher milk yields hold up the growth momentum, whereas, in New Zealand, favourable weather corroborates a positive production outlook (DAHD,19).

    1.    The heifer is bred (naturally or by insemination) before the age of two years.

    2.    The gestation period is nine months and one week.

    3.    After calving, the cow gives milk for 10 months.

    4.    1 – 2 months after calving the cow will again be bred.

    5.    The cow then continues to give milk for about 300 days. This period is known as lactation.

    6.    Milk should preferably be handled in a closed system, to minimise the risk of contamination. It must be cooled to 4 °C as soon as it is produced.

    7.    The content of protein, lactose and ash is somewhat higher in buffalo milk than in cow milk. Buffalo milk contains vitamin A, but lacks b-carotene, which is present in cow’s milk.

    8.    When milk and cream turn to butter, there is a phase inversion from an oil-in-water emulsion to a water-in-oil emulsion.

    9.    In milk, the whey proteins are in colloidal solution and the casein in colloidal suspension.

Date-palm (Phoenix dactylifera L.). belongs to family Palmae and is the most common tree of desert and dry areas. Date palm is one of the oldest trees known to man kind. Date-palm is believed to have originated in the countries around Persian Gulf. It is extensively grown in Iraq, Iran, UAE, Saudi Arabia, Algeria, Egypt, Libya, Yemen, Mauritiana, Morrocco, Tunisia, Baharin, Sudan, USA, Spain, Australia, Pakistan, South Africa, Somalia, Oman and some parts of the South America. Date is a staple food of the people of the Western Iraq and North Africa. In India, it has been believed to be introduced by soldiers of Alexander the Great in 4^th century B.C. In India it is commercially cultivated in Rajasthan, Punjab, Hariyana and Gujarat.

Cultivars: Deglet Noor, Halawy, Khadhrawi, Hayani, Majhul, Zahidi, Khalaeh.

Uses

Date palms produce many products that are useful to human beings. The primary product is the date fruit, which can be eaten fresh, dried, or in various processed forms. In North Africa and the Middle East, some dates are harvested and consumed during the Khalal stage, when the fruit are still very astringent with a high tannin content (Dowson and Aten, 1962 ; Glasner et al., 2002; Kader,1992). Dates can be used in cereal, pudding, bread, pressed cakes, cookies, candy bars, ice cream, and date shakes (a California specialty). Date fruit also can be made into juice, vinegar, wine, beer, sugar, syrup, honey, chutney, pickle, paste, dip, and food flavoring (Barreveld, 1993; Glasner et al., 2002).

It is said that there are as many uses of dates as there are days in a year. The trunk and wood of date palms can be used as timber, wood, or fuel. Fiber from the trunk and leaves can be made into bags, baskets, camel saddles, cords, crates, fans, food covers, furniture, mats, paper, ropes, trays, and twine. Dried bundles of leaves (‘‘Barusti’’) can be made into shades, roofs, separating walls, and enclosures. Ribs of the leaves can be used to build boats (small fishing boats called ‘‘Shasha’’) or fishing traps. The base of the leaves and fruit stalks can be used for fuel. The pith of the palms can be made into date palm flour. Terminal buds (palm heart) can be eaten as a salad or as a cooked vegetable. Date seeds can be used as feed for livestock or strung as beads for decoration. Oil from date seeds can be manufactured into soap (Chao and Krueger, 2007). Dates are considered a balanced and healthy diet and have several medicinal uses. Leaves are source of fibre used for making ropes baskets and cordage. Walking sticks are made from leafstalk.

Ice cream defects can result from formulation imbalance, poor ingredient quality, processing deviations, inadequate freezing or hardening, packaging problems, storage conditions, and cold-chain failures. This chapter provides a systematic framework for understanding, classifying, diagnosing, and correcting defects affecting flavour, body, texture, melting, colour, appearance, packaging, and storage stability. It emphasizes that a visible defect in the finished product may originate much earlier in the production or distribution chain. Examples include iciness caused by slow freezing or temperature abuse, weak body associated with formulation or overrun, and flavour problems originating from raw materials or microbial activity. Defect analysis therefore becomes an important tool for troubleshooting, quality improvement, training, and preventive action.

25.1 Introduction
Cream, butter, anhydrous milk fat, ghee and fat preserves, cheese, condensed milk, evaporated milk, skim milk, and whole milk powder are among the dairy products that have been extensively examined.
25.2 Defects in market cream
In the market, there are a variety of creams, including half cream, single cream, coffee cream, cultured cream, whipping cream, heavy whipping cream, aerosol cream, double cream, clotted cream, and high-fat creams (also referred to as plastic cream). The defects related to market cream are detailed in Annexure-I
1. Flavour defects in cream: Any flavor imperfections originally present in whole milk may become more noticeable in separated cream. Volatile compounds that are fat-soluble tend to concentrate in the fat portion, which can amplify these defects, such as an oxidized taste. Common flavor defects associated with cream include feed, cooked, malty, musty, utensil, weed, acid, bitter, and oxidized/rancid flavors. These flavor defects are further described in the section discussing flavor issues in Table butter.
2. Specific defects in cream
• Serum leakage, creaming, reduced overrun in whipping cream: Serum leakage typically results from partial churning (overwhipping), causing an unattractive liquid pool around the whipped cream or sogginess when applied to cakes. Excessive whipping leads to the formation of large fat globule clusters, which can break bubble-enclosing membranes, initiate bubble coalescence, and reduce overrun. This process may lead to an irreversible phase inversion, turning the cream into a greasy water-in-oil emulsion, visible as butter granules. Unfavorable creaming and serum separation can be delayed by lowering fat content (within legal limits), adding stabilizers like carrageenan, emulsifiers, or protein ingredients, or through post-UHT homogenization. Using a mix of kappa and iota carrageenan can help reduce creaming during storage and minimize whipped cream drainage.

The oldest written records of the human race are in Sanskrit and are preserved in India. At the time these records began, about 6,000 years ago, milk had already become an important article of food. In fact, so important was the cow to these early people of South and Central Asia that wealth was measured in numbers of cattle, and the cow was in time made a sacred animal and is still so considered in India.

According to the best authorities, the domestication of cattle must have occurred somewhere between 6,000 and 10,000 years ago. The cow was worshipped in Babylonia, and in Egypt about 20,000 B.C. Over fifty references to cows and milk are found in Old Testament and the Promised Land was described as “a land flowing with milk and honey”.

Milk is the only food of the young mammal during the first period of its life. The substances in milk provide more energy and the building materials necessary for growth. Milk also contains antibodies which protect the young mammal against infection. A calf needs about 1000 litres of milk for growth, and that is the quantity which the primitive cow produces for each calf. There has been an enormous changes since man took the cow into his service. Selective breeding has resulted in dairy cows which yield more than 5,000 litres of milk per calf, i.e. five times as much as the primitive cow. Some cows can yield 10,000 litres or more.

INTRODUCTION

Drying or dehydration is defined as the removal of moisture from its initial level to a level which renders food materials safe for subsequent storage. It is a simultaneous heat and mass transfer operation in which heat is supplied externally to evaporate moisture and air is forced through the bed to carry away the moisture. Drying is the oldest technique to preserve food materials. Advantages of drying include reduction in water activity, enhancement of shelf life, maintenance of flavor and nutritive value, and reduction in packaging and transportation costs. When the water activity of the dried product is reduced to below 0.6, most microorganisms do not grow and the rates of other deteriorative reactions are substantially reduced.

Drying is the oldest known method of preserving food. Drying or dehydration is removal of majority of water contained in fruit or vegetable. Although preservation is the primary reason for dehydration, it also lowers cost of packaging, storing and transportation by reducing both weight and volume of final product. In addition, dried foods add variety to our diets. In the process of drying, sufficient moisture is removed to protect product  from  spoilage. Processing should be done in such a way that food value, natural flavour and characteristic cooking quality of fresh material are retained after drying.

Materials Required

Dehydrator, balance, thermometer, sulphur dioxide, blanching pan, fruits / vegetables, polythene or aluminium bags.

Procedure

    1.    Select sound fruits or vegetables 
    2.    Record their initial weight and wash them properly in plain water to remove any dirt or extraneous matter. 
    3.    Peel with stainless steel knife (as the case may be) and cut into thin uniform pieces or slices of  0.2-0.5 mm thickness
    4.    Blanch the slices in boiling water for 1-2 min. to inactivate the enzymes followed by immediate cooling.
    5.    Treat the slices with sulphur (sulphuring or sulphiting) in order to prevent darkening of the product during drying. 
    6.    Dry the slices in a mechanical air dehydrator at about 55 + 5oC temperature.
    7.    Record the weight of the product after every 2 hr till it becomes (almost) constant i.e. when there no more (significant) loss of moisture from the product.
    8.    Pack the product in ploythene or aluminium laminated pouches and seal them air tight. 
    9.    If it is to be converted into powder, the dried product can be ground in a grinder before packing.
    10.    Label the packages and store them in a cool dry place.
    11.    Plot the drying rate curve of the product on a graph paper and analyse it.
    12.    Record the initial and final moisture content of the product (as discussed in Exercise No. 19). 

Drying and dehydration are interrelated terms. Drying generally refers to the method of removal of moisture from the food under natural conditions such as sunlight and wind for example open sun drying, shade drying etc. Whereas, dehydration refers to a process of removal of moisture by application of artificial heat under controlled conditions of temperature and airflow. In this case single layer of fruit and vegetables, either whole or sliced after primary pretreatments is spread on trays which are placed inside the dehydrator or in the open sun for drying. In the dehydrator, the initial temperature is generally kept at 43oC which is then gradually increased to 66-71oC for fruits and 60- 66oC for vegetables. Dried grapes (raisins and monucca), apricots, dates, apple rings/cubes, Morchella (Guchhi), bael, aonla, fig, green peas, cauliflower, cabbage, onion, garlic etc are commercial products prepared by using drying.
Procedure for drying: Drying generally involves three stages: pre-drying treatments or pre-treatments, drying of commodity and post-drying operations such as handling, packaging and storage. The flow sheet for drying of fruit and vegetables is shown in Figure 1 and details of pretreatments for drying fruits and vegetables are shown in Table 1&2 respectively.

Flowering plants (Angiosperms) are identified by their morphological characteristics like flower, fruit and seeds that help their taxonomic characterization into different species, genera, families and orders. The floral characters which are used for taxonomic characterization of plants include the type of inflorescences, perianth structure, floral symmetry, arrangement of floral leaves, type of androecium, stamens, gynoecium, carpel, ovule, etc. The type of fruit and seed also play important roles in taxonomic classification. In this chapter we will briefly discuss about various morphological features of flowering plants (in botanical terms) that are useful in taxonomy.

Nomenclature of Plant

Nomenclature of plant is the formal and scientific naming of plants. It is related to but distinct from taxonomy for grouping and classifying plants and provide botanical name.

The scientific/botanical nomenclature started with Species Plantarum by Carolus Linnaeus in 1753. Botanical nomenclature is governed by the International Code of Nomenclature for algae, fungi, and plants (ICN), which replaces the International Code of Botanical Nomenclature (ICBN).

ICBN and ICN

International Code of Botanical Nomenclature, (ICBN) was adopted by the VIIth International Botanical Congress held in Stockholm, July1950. While the International Code of Nomenclature for algae, fungi, and plants (ICN) was adopted by the XVIIIth International Botanical Congress held in Melbourne, Australia in July 2011.

Commercial ice cream represents a highly diversified category influenced by formulation, processing technology, regulatory standards, consumer preferences, cost structures, and market positioning. This chapter explains the meaning and characteristics of commercial ice cream, with particular attention to the Indian regulatory and market context. It examines major commercial product types, their compositions, ingredient functions, and differences from artisanal products. The chapter also discusses contemporary market trends and changing consumer expectations, including premiumization and alternative formulations. Quality challenges such as ice crystal growth, sandiness, shrinkage, weak body, coating defects, and cold-chain failures are considered, providing readers with a practical understanding of commercial ice cream production and positioning.

Introduction

Agriculture is the most important sector of Indian Economy. The agriculture sector accounts for 18 per cent of India’s gross domestic product (GDP) and provides employment to 50 per cent of the countries workforce. India has emerged as the second-largest producer of fruits and vegetables in the world. Formerly agriculture was more dependent on nature and all the operations were carried out manually, however new technologies have been developed to increase the production and productivity of crops (Rangbhal, 2018).

Bottom or demersal trawling continues to be one of the most important fishing methods of the world. In India more than 35,230 trawlers of various sizes ranging from 9 to 30 m L_OA with engine power ranging from 45 to 495 hp @ 2000 rpm are in operation. Trawl is a bag net towed through water to filter out fishes, the mouth of which is kept open horizontally by means of a beam or otter boards and vertically by means of floats and sinkers. Horizontal mouth opening is also effected by dragging the net from two boats known as bull trawling or pair trawling. The principle of trawling is the movement of the net under water filtering the water through the mesh in the netting, without either permitting the fish to escape or gilling them (Fig. 1). Trawl net is fabricated using polyethylene netting after cutting and shaping the panels as per the design

Concept: Operations conducted before and after harvest are essential components of the system for producing high-quality seeds. If enough care is not taken in the initial stage, there most likely won’t be any resources left to get high-quality seed. Like this, carefully produced, high-quality seed may lose a significant percentage of its worth if post-harvest management protocols are not adhered to. Its quality is highly correlated with soundness, fullness, and homogeneity of physical characteristics (size, shape, density, colour, and appendages), in addition to mechanical planting’s simplicity and improved crop establishment. Improving the seed that has been gathered and getting it ready for secure storage till needed are accomplished through the effective and efficient process of seed processing. To increase the quality of the seed lot, the goal of seed processing must be to optimize the physical properties of the seed and the constituents of the harvested seed mass. The three main steps in seed processing are conditioning, grading, and applying protectants or enriching with nutrients. These steps are completed in compliance with established protocols and standards (McDonald and Copeland 1997; Agrawal 1996; Jorgensen and Stevens, 2004). The distinct qualities of the crops and the surroundings are taken into consideration while adjusting the machines and operations.

Abstract

Designer foods are known by various names like medical foods, fortified foods, nutritional foods, nutraceutical foods, pharma foods etc. These foods are nutritious, maintain health and prevent diseases. Such foods must possess characteristics like modified composition; limit the presence of certain potentially harmful components and include certain desirable ingredients either naturally or by intentional addition. The term designer food emerged some years ago to describe foods tailored to specific concentration and proportion of nutrients that are important to health. These are designed and produced by using different approaches. The term ‘designer foods’ is subjected to change based on nutritional labelling regulations, new developments, consumer perceptions and expectations. Grain improvement through biotechnology emphasizes crop upgrading with a specific challenge to manipulate the endosperm composition in order to improve its intrinsic properties for diet and health. Breeding fruits with higher bioactive compounds for disease resistance and improved composition have stimulated interest in the nutraceutical and processing aspects of the fruits Nutritive and genetic interventions to alter milk composition for specific health and processing opportunities are gaining importance in dairy biotechnology. Designer eggs having modified fat provide choices with different nutritional benefits. The options suggested for designer meat and meat products are through production practices, post-harvest procedures and reformulation techniques. All these features of designer foods will be presented with suitable examples.

This chapter introduces specialty eggs whose composition, production system or marketing attributes differ from conventional eggs. It examines designer eggs, omega-3 enrichment, vitamin and mineral enrichment, organic egg production, free-range and cage-free systems, and welfare-oriented production. The chapter also addresses labelling, certification, consumer trust and the market prospects of specialty eggs. Particular attention is given to the biological basis and technological limits of nutritional enrichment and to critically evaluating claims concerning nutrition, welfare, safety and environmental benefits.

Food is an important item in the life of consumer as it has a direct bearing on the sustenance of life. The food safety or over concern on the health hazards was not considered as an issue until recently, particularly in the developing countries. This clearly indicates the shift in citizen’s mind from availability of food to quality of food. This along with the changes in the food habits and type of products available in the market for his consumption, the incidence of food borne illness across the globe and his concern for his health contributed significantly to the development of food safety in the food arena.

Until recently food safety domain and regulation were confined to the government and its regulatory machinery. The globalisation of food and food products and the passage of food across international borders paved way for the increased food safety concern across the globe and stressed the need for ensuring quality and safety of food in international trade. The incidence of food borne illness increased with increase in the appearance of more and more derived products started in the market (Sivapalasingam, Friedman, Cohen, & Tauxe, 2004; Tauxe, Doyle, Kuchenmüller, Schlundt, & Stein, 2010). The production along the value chain, from primary production to the retailing happen in the world under different agroclimate conditions, in varied production lines from sinle handler to community production to large scale mechanised production and such a diversity led to concerns in the food safety system (McCullough, Prabhu, & Kostas, 2008). The individual operators in the chain operates a food safety management system based on the availablity and to suit his requirement based on the basic principles laid down by natinal and International bodies like Codex Alimentarius Commission. Now when you see the market at large, has plenty of FSMS system which includes both from the governmental and private sectors. Therefore, Food Safety Management System (FSMS) is the result of the implementation of available and relevant quality assurance guidelines and standards availble and in the primary production it could be the implementation of good practices including good hygienic proactices, good aquacultural priactices which have proved effective in the food sector. On the production and trade sector this may include good manufacturing practices, good hygienic practices, probably including Hazard Analysis and Critical Control Point (HACCP) principles. In the process the FSMS may include essentially all the activites from equipment, procedures, programs, tools, organizational measures, and people necessary to execute the control and assuranceactivities aimed at ensuring chemical and microbial safety of fresh produce.
