ABSTRACT

Green packaging is a technique used to develop sustainable and eco-friendly packaging materials. In this review paper we have examined the data currently available on the use of plant by-products and plant extract in the development of green packaging. The use of plant fibres is especially beneficial because they often contain a high concentration of bioactive compounds. These compounds lend a preservative effect to the packaging material. Further we have also discussed the degradability of such packaging and the additives which need to be added in order to enhance their utility. Lastly, we have examined the possible applications of green packaging in the food industry.

Introduction

Rice (Oryza sativa L.) is the vital cereal crop, probably the oldest cultivated grain crop, produced under varied ecosystems is consumed as the primary source of food by the billions of people throughout the world covering 9% of total arable land among world. India is one of the top leading countries in the entire world in case of both production and consumption of rice. Rice is cultivated in 43.86 m ha geographical area of the country producing 115.6 million tons (2018- 2019) of rice. It is produced in various ecosystems throughout the country under diverse climatic and soil condition but the productivity is much lower as compared to other countries. According to Pandey et al. (2006), the average loss of rice production during drought years in major rainfed rice grown states like Chhattisgarh, Jharkhand and Odisha was found to be 30 percent of the annual production in case of non-drought years.

ABSTRACT

The global market for baked products has reached up to $495 billion in the year 2019. It is estimated that its value will reach up to $580 billion by the end of 2025 with a growth rate of 2.7 % between 2020 to 2025. Ovens are operated with the help of LPG/diesel/electricity. The hybrid ovens can give higher energy efficiency along with targeted quality parameters. The previous data such as oven temperature, heat supplied per unit time, the moisture content and variety of the raw material used can be provided to a specific computer programme. The heat recovering unit is a unit which captures the escaping hot air and the same may be reused by pumping the hot air to the front of the oven to preheat the incoming cold air. The biogas can be generated from the bakery waste. There will be 45 % or more methane production from bread and biscuit waste in the retention time of about 12 to 55 days in a biogas plant. To make the bakery fully operated on green technology, solar renewable energy can also be utilized.

Abstract

Water scarce state Rajasthan is without efficient and effective management. Water, when at surface is cheaper and like free commodity to use. Most of it gets evaporated rapidly due to aridity. There is no water during summers and drought years. This is now critical time to rethink and review our planning and policies and make it ground water oriented instead of completely surface water based. Ground water management should be the thrust area and key issue. There is need to conserve andharvest each drop ofwater especially for recharge to ground water. Utilize the augmented ground water resources as crisis management during long dry spells. Also, enforcement of regulatory measures, creating awareness among masses and participatory approach ofmanagement are the key factors for ensuring sustainable availability of water resources.

Introduction

Rice plays a unique role in providing food to the majority of the world population. Rice is the most widely consumed food for nearly three-fourths of the population in India. Now a days scented rice is getting higher market price than normal rice varieties. Black Scented rice is commonly considered as forbidden rice. Different researches proved that black Scented rice is one of the “super food” of the world. Black Scented rice is consumed in various ways like puddings, pulao, bread, etc in different festivals and during important ceremonies. Mostly this crop is prone to lodging but resistance to infestation by insect and pest. Works done in India and abroad indicates that the particular method of establishment, adequate level of nitrogen and a particular time of application of nitrogenous fertilizer can enhance productivity. Nitrogen is the main nutrient that determines rice yield, due to its role in the photosynthesis, biomass accumulation and, spikelet formation (Hasegawa et al., 1994; Yoshida et al., 2006).

The term growth as applied to higher organisms such as animals commonly is concerned with increase in protoplasmic mass and does apply to reproduction or to increase in number. In microbiology the term refers to increase in the number of organisms. Bacteria increase in number by a process of simple binary fission. Each cell increase in size and redivide into two similar cells. Each of the divide cells may in turn divide to become two cells. Each division produces what is termed as new generation of cells, theoretically there are 2,4,8,16,32,64,128,256 cells in the 2,3,4,5,6,7,8,& 9th generation, this is known as logarithmic growth – the population doubles with each successive generation. Under favourable conditions, bacteria produce generation within 15min. Under unfavourable conditions 24 hours of more may be needed for each generation. Generation time for E.coli is 17 to 20 minutes.

Guava (Psidium guajava. L), a highly nutritious fruit very popular as poor man’s apple. Guava belongs to the family Myrtaceae. Guava is native to tropical America and is found growing wild from Mexico to Peru. Spaniards introduced guava in Phillippinnes and the Portuguese in India. Besides India, it also grown in Sri Lanka, Hawaiian Islandsm and Cuba. Guava had been introduced in India by Portuguese in 17^th century, and ever since it is an important fruit crop of India. In many countries it has been spread by birds, where it has been naturalized long back. In India it is cultivated in the plains in almost all the states but the major guava growing states are Maharashtra, Madhya Pradesh, Uttar Pradesh, Bihar, West Bengal, Punjab, Karnatak, Andhra Pradesh, Odisha, Tamil Nadu, Chhatisgarh.

Uses

Guava fruit is relished when mature or ripe and freshly plucked from the tree. Excellent salad and pudding are prepared from the shell of the ripe fruit. Ripe and unripe juicy fruits are eaten fresh. The fruits after removal of seeds, are used for preparing jam, jelly, paste, juice and nectar. It is also canned in sugars syrup and made into fruit butter. In some countries, the leaves are used for treating diarrhea and also for dyeing and tanning.

For setting up a fruit processing plant, the following cost and non-cost factors affecting the plant’s location are considered. Cost factors include raw material cost, transportation cost, cost of land, building and machinery, utilities cost, taxes, and insurance costs. At the same time, non-cost factors consisting of wages, salaries and incentives, market potential, community attitude, cost regulation, quality of life (school, living, recreation for workers, etc.), and environmental impact are taken into consideration. The main objective for the selection of the site for the processing unit is to minimize the sum of all costs. To minimize the cost, one should think not only the today’s costs but about long-term costs as well.

In India, the procurement and disposal of food grains are governed by several guidelines to ensure food security and fair market practices. Procurement is typically managed by government agencies like the Food Corporation of India (FCI), which purchases grains directly from farmers at minimum support prices (MSP) to stabilize market prices. Farmers are encouraged to sell their produce through designated government procurement centers, ensuring fair prices.
The quality of food grains is a key consideration in procurement. Grains are tested for moisture content, cleanliness, and pest infestation before being accepted. Once procured, the grains are stored in government warehouses, with regular inspections to prevent spoilage and pest damage. For disposal, food grains are distributed through public distribution systems (PDS) to ensure availability to consumers at subsidized rates. Any surplus grains may be sold in open markets, or occasionally exported, to maintain a balance in supply and demand. Effective management ensures food security and minimizes wastage.
PROCUREMENT POLICY OF WHEAT AND RICE
State Government agencies and the Food Corporation of India (FCI) are responsible for purchasing wheat and paddy within the designated period, ensuring that the products meet the prescribed Fair Average Quality (FAQ) specifications and are procured at the Minimum Support Price (MSP) for the Central Pool. This procurement supports the distribution of food under the National Food Security Act (NFSA) and other welfare schemes (OWS).
The Government of India (GoI), in consultation with State Governments and FCI, finalizes procurement estimates for wheat and paddy before each marketing season. These estimates are based on anticipated production, marketable surplus, and the agricultural crop pattern. The procurement of paddy and wheat is carried out under both the Decentralized Procurement System (DCP) and the Non-DCP system.

HACCP: The Hazard Analysis and Critical Control Points (HACCP) is a scientific, rational and systematic approach to identify, assess and control hazards during production, processing, manufacturing and use of food. It ensures safety of the food. HACCP presents a good opportunity for the food industry for upgrading quality and bringing uniformity and consistency in their supplies to international market. or It is a systematic preventive approach to food safety that addresses physical, chemical and biological hazards as a mean of prevention rather than finished product inspection. It involves identification, evaluation and control of hazards which are significant for food safety.

HACCP plan: A document prepared in accordance with the principles of HACCP to ensure control of hazards which are significant for food safety throughout the food chain under consideration.

Haemagglutinins: A group of proteins of plants that are not antibodies and do not originate in an immune system but bind specifically to carbohydrate containing receptors on cell surfaces (red blood cells). It is also known as Phytoagglutins / lectins.

Introduction

Over centuries, spices have been used as an important addendum for colour, flavour and preservation of foods. In addition, their medicinal and cosmetic utilities have been widely recognized (Purseglove et al., 1981; Srinivasan, 2005). All these benefits made them extremely desirable with an ever growing demand in the international market. India holds the title of the largest producer and exporter of spices with major share for pepper, capsicum, turmeric, ginger cardamom, seed spices, curry powders, spice oils and oleoresins. The other primary producers of spices includes China, Indonesia, Malaysia, Egypt, Turkey Brazil and Mexico while USA, Europe, Japan, East Asian and Middle East countries are their major importers.

Spices are made from diverse plant parts viz. rhizomes, barks, leaves, fruits and seeds and hence its processing methods vary depending on the raw material. However, the basic unit operations namely harvest, pre-treatment, drying, cleaning, particle size reduction, packaging and microbial decontamination in sequence remains common for the production of most of the spices. Inappropriate conduct of basic unit operations often lead to high microbial load, aflatoxin contamination, losses of valuable compounds, change in sensory characteristics, physical damages and incorporation of contaminants in spice products (Table 1). Moreover, spices being natural products, they may be fraught with a large number of microorganisms including several pathogenic species of bacteria and fungus depending on the prevailing conditions in their cultivation areas. In addition, poor food sanitation awareness and practices in spice producing countries may worsen their microbiological safety. Although spices are nonperishable in nature due to their low moisture contents after drying, they may act as a source of microbial populations upon contact with moist food products with no further thermal treatment. The outbreak of ‘salmonellosis’ in Germany (1993) due to contaminated paprika and paprika-powdered potato chips is an example. The aforesaid disadvantages related to conventional spice production may confound their international trade unless desired objectives of food safety management schemes such as International Commission on Microbiological Specifications for Foods (ICMSF) are met. Moreover, international agencies have set standard to guarantee safe spices and augment business interests of their adherents. For example, both the European Spice Association (ESA, 2015) and American Spice Trade Association have set a maximum level of 1% w/w extraneous matter in spices (ASTA, 2017). These challenges associated with the conventional production system may be effectively addressed by preventive risk management strategy by which suitable control measures are enforced at earlier phases of food chain prior to consumption. The control measures must guarantee that the level of contamination has not exceeded the maximum permissible limit at every phase of spice production from farm to table.

Quality of fish raw material plays an important role for the quality of the end-product. Once the fish raw material freshness and nutrition value is lost, it cannot be recovered in the processing stages. Products that are processed from low quality raw material are not always a safety risk, but the quality (nutrition value) and shelf life is significantly decreased. The quality deterioration can start right away during fishing and it continues all the way to the final user. Time-temperature abuse should be avoided at all stages of handling till landed fish reaches the consumer or the processor. In tropical countries more care in handling is necessary as fishes thrive in high ambient temperature has high body temperature and hastens spoilage.

Fish is highly perishable because of their chemical composition. It has high content of soluble substances in the flesh (many of which contain nitrogen and triglycerides characterized by polyunsaturated fatty acids) and high level of autolytic enzyme. After the death of the fish, spoilage starts due to the action of microbes, enzyme and oxidation. It is therefore, necessary to preserve fish after harvest if not consumed or disposed immediately.

Use of acid/base is common in laboratories for experiments like titration and proper safety in their handling laboratory is necessary. In this chapter we will briefly discuss about the safety measures necessary to be adopted while using acids/bases in laboratory for any experiment.

Handling of Strong Acid/Base

There are four major points that need to be taken care of while working with strong acids or bases that might be quite harmful if any accident happens.

1. Protect Yourself

Wear a lab-coat and acid-resistant gloves: Always use lab-coat/apron and make it sure that the sleeves properly cover your arms. More importantly, use gloves made of acid-resistant materials and also wear shoes to protect your feet while wearing long-pants/jeans. Female with long hair, must tie her hair properly (with rubber band) to avoid any disturbance caused by appearance in between.

Wear safety goggles: It is important to wear safety goggles to protect your eyes using larger and fitting goggles that cover front as well as sides of your eyes. Always use properly fitting and adjustable goggles because smaller/ loose goggles may not protect the areas around your eyes against accidental acid spills and it may fall down from your face, if it is too loose.

Locate emergency wash area: There must be an emergency washing area nearby the work place or laboratory containing lab spill management kits. All the workers in the laboratory must be aware of using the kits and emergency plans.

Neutralize acid: Don’t panic even if an acid or chemical spill happens. Stay calm and act as quickly as possible. In case an acid spills, neutralize it by using sodium bicarbonate so that they can be cleaned and disposed safely. If acid comes in contact of skin, wash it off under running tap water but do not use/ apply sodium bicarbonate on skin.

For proper and efficient experiment to be conducted, experimenters need so many chemicals to deal with. This includes different acids, base, salt, different kind of indicators and so on. Some of these chemicals are safe for health, but some of them are dangerous to health when come in close proximity to our body while some of the chemicals cause health issues on inhaling. These may cause improper functioning of some of our physiological activities. Acids and bases are very dangerous for our tissues when come in our contact. These may cause serious respiratory problem in addition to injuries on coming to our contact. Some chemicals are exploratory yet they may cause even death of the person working with them in laboratory. Therefore, mere use of the chemicals in laboratory is not only the objective of the experimenter. The person working in laboratory should also be concerned about the proper use and handing of the chemical while working with it. Thus, every researcher of an institution who has to work with chemicals in a laboratory should be made aware about the chemicals to be used in the laboratory and the consequences if any mishandling of a laboratory chemical occurs. Not only these, suitable precautionary measures should also be known to the researcher along with ensuring the availability of the required safety equipment/installations. Hence, a proper understanding of the ways of handling of chemicals in a laboratory is of prime importance for the personals like you who are working or have to work in laboratory.

Safe Handling of Chemicals in Laboratory

Safe use/handling of chemicals in laboratory include minimized exposure to chemicals, maintaining safety data sheets, proper labelling, storage, segregation, and transport of chemicals for personal hygiene.

Introduction

We come across a variety of chemicals every day in a laboratory. While some of them are relatively safer, others are extremely hazardous. Thus, it is very important to know the potential hazards that can be caused by the chemicals present in the laboratory and the safety measures needed to be followed to avoid the hazards. Additionally, we should also be aware of the steps necessary to be taken on such hazardous situations. According to IUPAC, a hazardous chemical mean the chemical which has the potential to cause damage in various ways. In a laboratory, there are chemicals that might be irritant, carcinogen, respiratory fibrogen, systemic poison, asphyxiant, flammable, etc. which have the potential to cause hazard to the workers or environment. Therefore, it is important to use appropriate procedure to reduce the risk and protect the health/safety of laboratory personnel, the public and the environment.

Types of Hazards Associated with Chemicals

Chemical hazards: The hazards caused by chemicals can be broadly classified into three categories.

1. Health hazard: This is also known as toxic effects of chemical. The risk associated with a chemical in laboratory depends on the extent of exposure and the inherent toxicity of the chemical. Many chemical reactions form the product that might be much more toxic than the reacting chemicals. For example, inadvertent mixing of formaldehyde (a common tissue fixative) and hydrogen chloride results in the generation of bis(chloromethyl) ether, a potent human carcinogen. For most of the chemicals, the route of exposure (through skin, eyes, gastrointestinal tract, or respiratory tract) is more important (Figure 17.1) that must be considered during risk assessment.

In India, the collection, transport and distribution of raw milk involves a number of agencies and persons at rural and urban level – village producers, milk collectors, halwais (Sweet-makers), milk vendors, dairies, producer-retailers and wholesale or retail markets.

1. Collection

Usually, the milk collectors approach the small village producers to collect milk and the same is sold directly or indirectly (through agents) to a dairy (milk procurement centres) or halwais or city milk vendors or consumers. The producer – retailers themselves, in some cases, supply the milk to the above said parties. The production of milk in small, scattered holdings in village causes problems during its collection. It involves visits to many villages, some of which are not easily accessible for the purpose.

1. INTRODUCTION

Every fruit or vegetable is harvested keeping in view, its intended use. At what stage it should be harvested, is indicated by the maturity index. The chapter focuses on these and postharvest quality of fruits and vegetables.

2. FRUIT MATURITY

"Maturity of a fruit can be defined as that stage at which a commodity has reached a sufficient stage of development that after harvesting and postharvest handling, its quality will be at least the minimum acceptable to the ultimate consumer”. Maturity is of two types:

4.1 Harvesting

Pomegranate being non-climacteric fruits should be picked when fully ripe. Its fruits become ready for picking 120-130 days after fruit set. Mature fruits should be immediately removed from the plants as delay in harvesting leads to fruit cracking. Fruits harvested at a premature stage have poor keeping quality and are prone to damage during handling and transport. The fruits are harvested when outer rind becomes yellowish and the fruit when tapped produces a metallic sound. The round fruits become flattened from all the sides and basal beak shaped portion shrinks at the time of maturity. Fruits are harvested with the help of secateurs by retaining 1 cm stalk with the fruit. All the fruits should be harvested in 2-3 pickings within a span of one month.

Post-Harvest Losses

A post-harvest loss is defined as the measurable qualitative and quantitative food (including fruits and vegetables) loss along the supply chain, starting at the time of harvest till its consumption or other end uses (Hodges et al., 2011). Pineapple fruits are highly perishable in nature and continuously respired even after harvesting which limited its shelf-life leading to the storage problems (Hossain and Bepary, 2015) and decline in production due to post-harvest losses (Babalola et al., 2008). During the storage for distant marketing, pineapple fruits easily losses its moisture content through transpiration and become more susceptibility to microbial spoilage (Hossain and Bepary, 2015). In India the top five leading pineapple producing states are West Bengal, Assam, Karnataka, Meghalaya and Manipur (Anonymous, 2018). The measurable qualitative and quantitative losses of pineapple at post-harvest level are from the various stages of handling from the farm level up to the consumers (Table 1 and 2).

The food is considered as one of the essential for the maintenance of life. Manufacturing of the food product is not enough form the food industry. It is necessary that the food available is safe, hygienic; wholesomeness and its quality must be assured. The food industry is an important segment of industries in India and has its own peculiarities unlike other industries. Food processing industry has been recognized by government as a major sector of growth. It must be free from harmful additives, microbes and remain so for a period, it is intended to be consumed. Therefore, the methods employed in quality and food safety assurance programme within the food industry will vary considerably in accuracy and sophistication according to the type of process and size and nature of resources available. Since the international market has become demanding in terms of quality, safety and delivery, installation of Hazard Analysis Critical Control Point (HACCP) in food industry would provide a competitive edge to food supplies in the international market. Food control refers to all activities carried out to ensure the quality, safety and honest presentation of the food at all stages from primary production through processing and storage, to marketing and consumption. The term has been used to describe a total national effort involving an integrated approach between government and all segment and sectors of the food industry. Food control is linked to improvement in the health of the population, potential of a country’s economic development and reduction of spoilage and food losses.

A wide variety of quality determinants is employed, including size, colour, maturity and extent of blemishes. Quality is a measure of the degree of excellence or degree of acceptability by the consumer. The marketing of fresh fruit and vegetables is aimed eventually ay appealing to the consumer for whom tradition plays a major role in determining the acceptability of a food item. The eating habits of people are conservative. The increase of direct market from producer to supermarket chains is leading to the imposition of standards to predetermined specification by the supermarkets. Important factors in quality for the consumers are: appearance, including size, colour, shape, condition and absence of defects, texture, flavour and nutritional value. Quality is the ultimate criterion of the desirability of any food product to the consumer. The overall quality of food depends on the nutritional and other hidden attributes. Quality of foods can be defined as the ‘composite’ of the ‘characteristics’ that differentiate individual units of a product and have significance in determining the degree of acceptability of that unit by the buyer.

There are specific hazards associated with equipment, operation or a particular section. Such possible hazards and their preventive measures are discussed below.
I. Milk Reception Dock
    1.    Where the top of a vat, into which a 40 litre can of milk is to be dumped, is higher than the milk can, two men should lift and empty the can.
    2.    Where steam jet method of can washing is used, to avoid burning, employees would be furnished with protective equipment, including rubber boots and long aprons
    3.    Cans should be stacked in areas away from frequently used passage ways
    4.    Cans should not be stacked so high that they may fall and injure someone

By exploring mechanical hazards, environmental influences, and atmospheric interactions, this chapter provides insights into the crucial role that resilient packaging plays in safeguarding food from production to point-of-sale.

Introduction

Food Safety is the assurance that food is acceptable for human consumption according to its intended use. The slogan of the World Food Safety Day 2019 “If it’s not safe - it’s not food!” portray, unsafe food is a threat to mankind. Ensuring food safety to protect public health and promote economic development is of utmost importance and it remains a significant challenge in both developing and developed countries. Food borne diseases remain a real and formidable problem, causing great human sufferings and significant economic losses. According to WHO 2019-20 World Water Day report, one third of the population of developed countries may be affected by food-borne diseases each year and the problem is likely to be even more wide spread in developing countries, where food and water borne diarrhoeal diseases kill an estimated 2.2 million people each year, mostly children. While unacceptable rates of food borne illness still remain, new hazards continue to enter the food supply.

A food safety hazard refers to any agent with the potential to cause adverse health consequences for consumers. It occurs when food is exposed to hazardous agents which result in contamination of food. In other terms it can be defined as anything that could contaminate food or could otherwise violate established food safety program criteria, if left uncontrolled. The National Advisory Committee on Microbiological Criteria for Foods (NACMCF, 1997) defined a hazard as a “biological, chemical, or physical agent that is reasonably likely to cause illness or injury in the absence of its control”.

A hazard may be introduced into the food supply any time during harvesting, formulation and processing, packaging and labelling, transportation, storage, preparation and serving. Food safety hazards are generally categorized into four classes: Physical, chemical, biological and allergens. Food manufacturers can adopt Food Safety Management Systems (FSMS), which include Good Manufacturing Practices (GMP), Good Hygiene Practices (GHP), Hazard Analysis and Critical Control Point (HACCP) and other practices to strictly check the hazards and make the food safe.

Understanding the hazards that contribute to food borne illness and injury is important to determine the necessary steps to prevent or reduce it to an acceptable level or eliminate hazards altogether before food reaches the consumer.

General Signs of Healthy and Ill Animals

Health

It is a state of freedom from disease. It may also be stated as a condition of an animal in which all the body organs are normal and are functioning to their optimum capacity in relation to animal’s age, sex, work, and production with optimum pulse, temperature and respiration rates appropriate to the species, sex and environment.

Disease

Disease may be any deterioration from normal health or normal functioning of any or all the tissues or organs of animal body. Thus, it shuns animal to perform its normal physiological functions though the nutritional and environmental parameters are maintained normal.

Abstract

Health-conscious consumers are increasingly seeking functional foods in an effort to control their own health and well-being. The field of functional foods, however, is in its infancy. Claims about health benefits of functional foods must be based on sound scientific criteria. A number of factors complicate the establishment of a strong scientific foundation. These factors include the complexity of the food substance, effects on the food, compensatory metabolic changes that may occur with dietary changes, and, lack of surrogate markers of disease development. Additional research is necessary to substantiate the potential health benefits of those foods for which the diet-health relationships are not sufficiently scientifically validated. Research into functional foods will not advance public health unless the benefits of the foods are effectively communicated to the consumer. Finally, those foods whose health benefits are supported by sufficient scientific substantiation have the potential to be an increasingly important component of a healthy lifestyle and to be beneficial to the public and the food industry. Mounting evidence supports the observation that functional foods containing physiologically-active components, either from plant or animal sources, may enhance health. It should be stressed, however, that functional foods are not a magic bullet or universal panacea for poor health habits. There are no “good” or “bad” foods, but there are good or bad diets. Emphasis must be placed on over-all dietary pattern, which follows the current Dietary Guidelines, and is plant-based, high in fiber, low in animal fat, and contains 5-9 servings of fruits and vegetables per day.

Heat desiccated products represent khoa and khoa-based sweets, rabri, basundi, etc. These are important traditional dairy products. Traditional dairy products and a great assortment of sweets is an integral part of Indian heritage. These products are endowed with enormous value and enjoy tremendous mass appeal. Of great social, religious, cultural and economic importance these products have been developed over a long period of culinary skills and carry with them, the age-old wisdom and experience. Traditional dairy products have always played a pivotal role in preservation of precious milk nutrients and promotion of its consumption among masses. The increased availability of milk during the flush season coupled with lack of facilities to keep liquid milk fresh during transit from rural production areas to urban market has led to the conversion of milk into variety of traditional products. In addition to preservation of milk solids for longer duration, manufacture of traditional dairy products adds value to milk and also provides tremendous employment opportunity. It is estimated that about 50% of milk produced in India is converted into a variety of traditional products.

Traditional dairy products represent the most prolific segment of Indian dairy industry. These products not only have an established market in India but also have a great export potential because of strong presence of Indian diaspora in many parts of the world. In view of the growing awareness towards the safety aspects of milk-based sweets in India, the consumer shall prefer to buy these products from the organized sector. Despite the widespread popularity and acceptability of traditional milk products in the Indian market, the organized sector has so far not been able to tap into this market potential for many reasons such as lack of published literature on their technology, inadequacy of appropriate technologies for their commercial exploitation, inadequacy of appropriate packaging materials and labeling to take care of new pattern in consumer demand, low keeping quality and a lack of quality assurance systems.

Abstract

The objective of this chapter is to provide an overview of heat pump dryer (HPD) and recent developments in its applications for drying of agricultural and food products. The basics of heat pump dryer, classification, operating principle, configuration and control system have been presented for better understanding. Many researchers have concluded that HPDs use energy more efficiently than electrical dryers. The heat pump dryer is best suited for drying high value commodities such as fruits, vegetables, spices, condiments, herbs, medicinal and aromatic plants at near ambient temperature for producing better quality dehydrated product.

3.1 Introduction

The subject of heat transfer is firmly grounded in the sciences of thermodynamics and fluid mechanics. It has become exceedingly important for engineers to possess a clear understanding of the principles of heat transfer and its application to a large number of problems. In view of process engineering, the knowledge of heat transfer and its application is most important, because heat transfer is one of the basic unit operations in the agricultural processing activities. The design of process equipments, refrigerators, boilers or type of heat exchangers, thermal treatment of food grains, cooling of perishables, pasteurizations, sterilizations, freezing of milk and fruit juices and a large number of similar applications involve consideration of heat transfer rates. There may be other situations where heat is being generated during a certain operation, and may be detrimental to the equipment and the food product. In such cases we are often faced with the task of removing the undesirable amount of heat as far as possible.

SYNOPSIS

Flavor is the sensory impression of a food or other substance, and is determined mainly by the chemical senses of taste and smell. The flavor of the food, as such, can be altered with natural or artificial flavorings which affect these senses. Smell is the main determinant of a food item’s flavor. While the taste of food is limited to sweet, sour, bitter, salty, umami (savory), pungent or piquant, and metallic – the seven basic tastes – the smells of a food are potentially limitless.

1. Herbs and Spices
       
    1.    International Standards Organization (ISO) defines spices and condiments as: Vegetable products or mixtures thereof, free from extraneous matter, used for flavouring, seasoning and imparting aroma in foods.

    2.    Rosengarten describes a spice as a product which enriches or alters the quality of a thing, for example altering the taste of a food to give it zest or pungency; a piquant or lasting flavouring; or a relish. The term ‘spice’ is thus used to cover the use of spices, herbs and certain aromatic vegetables to impart odour and flavour to foods.

    3.    Herbs may be defined as the dried leaves of aromatic plants used to impart flavour and odour to foods with, sometimes, the addition of colour. The leaves are commonly traded separately from the plant stems and leaf stalks.

This alternative pathway for glucose oxidation has enzymes in the cytosol through which glucose is degraded to carbon dioxide. It is also called a shunt because carbon atoms from glucose 6-phosphate take a long route before they proceed down the EMP or glycolytic pathway. This pathway is anabolic in nature as it produces many intermediates. In this pathway, two NADPH are generated from one glucose 6-phosphate molecule. No ATP is generated or consumed.
Overall, this pathway needs three glucose-6-phosphate molecules to complete all the reactions. Therefore, one cycle run produces 2 mol of fructose-6- phosphate, 1 mol of glyceraldehyde-3-phosphate, and 3 mol of carbon dioxide from 3 mol of glucose-6-phosphate with the reduction of 6 mol of NADP+ to NADPH.

The art in producing high-boiled sweets with satisfactory shelf life is manufacturing boilings which contain the minimum amount of residual moisture and a satisfactory balance between cane or beet sugar, and glucose syrup or invert sugar syrup. The main physical change during the storage of high-boiled sweets is the formation of small crystals in the confection, usually referred to as graining, due to recrystallisation of sucrose. These spoil the appearance and cause an unpleasant roughness on the tongue.

For high-boiled sweets it is impossible, using the normal proportions of cane or beet sugar (sucrose) and glucose syrup, to obtain a product of 97% solids content, which is not supersaturated with respect to sucrose.

In practice, however, one-and-a-half parts of sugar (sucrose) to one part of forty-two DE glucose syrup will produce a high-boiled sweet stable against graining.

1. Introduction

Fruit products have their unique identities having large content of micronutrients, polyphenols, vitamins, flavonoids and other nutritional compounds. Characteristic appearance and flavors distinguish among various fruit based products like juice, puree, jam, jelly, squash and other several varieties. Main concern of this fruit processing industry is the stability of the products throughout the post processing storage. Thermal treatment as mean of preservation of these products is the common process implemented so far. It ensures the safety of the product but lacks in retaining the nutritional intact that like of fresh fruit. Today’s consumer demand for minimally processed fruit products and “natural” fruit products tend to think of alternative thermal processing.

High pressure processing (HPP), a relatively new concept compared to conventional thermal processing, also sometimes known as high hydrostatic pressure (HHP), or ultra high pressure (UHP) processing, is a non-thermal food processing method that subjects liquid or solid foods, with or without packaging, to pressures ranging between 50 and 1000 MPa. HPP has already been established itself as an alternative to thermal processing. In food processing it is of great interest due to its ability to inactivate food borne microorganisms and enzymes, at low temperature, without the need for chemical preservatives and it is less detrimental than thermal processes to low molecular weight food compounds such as flavoring agents, pigments, vitamins, etc., as covalent bonds are not affected by pressure. Pressure-treated foods have sensory properties similar to fresh products, which is a major advantage in fruit processing as it matches consumer demand for healthy, nutritious and ‘‘natural’’ products. HPP of fruit products offers the chance of producing food of high quality, greater safety and increased shelf life (Hayashi 1989; Gould 1996; Butz and Tauscher 1998).

4.1 Introduction

The purpose of processing the food is to make it safe and healthy for human consumption. The term food processing refers technologically anything, which transforms raw ingredients into consumer ready products, with the aim of stabilizing food products by preventing or reducing deteriorative changes in quality. The objective of food manufacturers is to develop, modify and employ those processing technologies that retain or create desirable sensory qualities in food and eliminate or reduce undesirable changes due to processing.

The purpose of food processing is to increase the shelf life of food before spoiling (preservation); to remove, destroy or inhibit pathogens and toxins (food safety); to change flavor, texture, aroma, color or form (variety); to reduce preparation times and make food more portable (convenience); to restore and/or raise nutrient levels in food (nutrition).The various food processing methods used extensively in food industry include physical (high temperature, freezing, chilling, dehydration, packaging), chemical (control of storage gases, reduction of water activity, pH, addition of chemical additives or spices) preservation methods.

Traditionally, food preservation has been associated with thermal treatments alone or in combination with biochemical or chemical methods. For example, the thermal processing of milk is done various thermal treatments viz. at 63^oC for 30 min for low temperature long time (LTLT), 72^oC for 15 seconds for high temperature short time (HTST) pasteurisations and up to 140^oC for a few seconds for ultra high temperature (UHT) treatment. However, such thermal treatments effectively reduce level of microorganisms but in long-term preservation, it may lead to losses of desired organoleptic attributes and destruction of temperature liable nutrients and vitamins. The limitations involved with thermal processing has been overcome by employing chemical preservation, cool chain management and process hygiene in the formulation and production of food products.

Food and nutrition are necessary for all living beings to maintain good health[1]. Thermal treatment is commonly used for preservation of food. Although application of thermal treatment can ensure food safety, it may cause undesirable changes in the nutritional, sensory and functional properties of food products[2]. Due to growing awareness of connection between the diet and the health, there is an increase in demands for fresh-like, palatable, additive-free and microbiologically safe food products with high nutritional value and quality[3].

High-pressure processing (HPP) is a novel method for non-thermal preservation technique of food that inactivates harmful pathogens and vegetative spoilage microorganisms. HPP is an alternate, non-thermal food processing method, wherein the food is subjected to a very high pressure range from 100 -800 MPa (1MPa = 145.03 Psi or 10 Bar). HPP is also referred as High hydrostatic pressure processing, Ultra high-pressure processing, Hyperbaric processing and Pascalization (Rao et al., 2014).

Ice cream has evolved from simple frozen preparations into a sophisticated food industry combining dairy science, food chemistry, refrigeration, microbiology, processing technology, packaging, and cold-chain management. This chapter introduces the historical development of ice cream and explains its transformation from a luxury product into a widely consumed frozen food. It examines the characteristics of the industry, major categories of ice cream and related frozen products, flavour classifications, composition, and quality characteristics. The chapter also presents the basic manufacturing process, important quality-control parameters, common manufacturing challenges, and emerging industry trends, providing a foundation for understanding ice cream as both a technical product and a commercial business.

Microorganisms (or microbes) are organisms too small to be seen with the naked eye. The science of microbiology is the study of microorganisms, their properties, classification, growth requirements, method of reproduction and distribution in nature. These organisms range in size from tiny viruses to larger bacteria, protozoa, algae, fungi and some of the microscopic worms (helminthes). They are present everywhere in our environment, in our homes, on our bodies, on the things we touch and on the food we eat. They are important for human survival on Earth, playing an essential role in many processes that maintain life. In nature, microorganisms carry out a number of important functions.

Bakery Industry

Baked goods have been around for thousands of years. The art of baking was developed early during the Roman Empire. It was a highly famous art as Roman citizens loved baked goods and demanded for them frequently for important occasions such as feasts and weddings etc. Due to the fame and desire that the art of baking received, around 300 BC, baking was introduced as an occupation and respectable profession for Romans. The bakers began to prepare bread at home in an oven, using mills to grind grain into the flour for their breads. The oncoming demand for baked goods vigorously continued and the first bakers’ guild was established in 168 BC in Rome. This drastic appeal for baked goods promoted baking all throughout Europe and expanded into the eastern parts of Asia. Bakers started baking breads and goods at home and selling them out on the streets.

This trend became common and soon, baked products were getting sold in streets of Rome, Germany, London and many more. This resulted in a system of delivering the goods to households, as the demand for baked breads and goods significantly increased. This provoked the bakers to establish a place where people could purchase baked goods for themselves. Therefore, in Paris, the first open-air bakery of baked goods was developed and since then, bakeries became a common place to purchase delicious goods and get together around the world. By the colonial era, bakeries were commonly viewed as places to gather and socialize.^[2] World War II directly affected bread industries in the UK. Baking schools closed during this time so when the war did eventually end there was an absence of skilled bakers. This resulted in new methods being developed to satisfy the world’s desire for bread. Methods like: adding chemicals to dough, premixes and specialized machinery. Unfortunately these old methods of baking were almost completely eradicated when these new methods were introduced and became industrialized. The old methods were seen as unnecessary and financially unsound, during this period there were not many traditional bakeries left.

Bakery is a traditional activity and occupies an important place in food processing industry. The bakery manufacturers in India can be differentiated into the three broad segments of bread, biscuits and cake. About 1.3 million tonnes of the bakery products industry in India is in the organized sector out of 3 millions tonnes, while the balance comprises of unorganized, small-scale local manufacturers. Though, there are sufficient automatic and semi-automatic bread as well as biscuit manufacturing units in India but there are still number of people prefer fresh bread and other products from the local bakery. After entry of Pizza and Burgers’ MNCs in the country, people are changing their tastes also. Today, they are not restricted to bread, cake and biscuits but to other bakery products also. The consumers are increasingly going for newer options with respect to bakery products. With the ventures of few Companies like Britannia, Biskfarm, and Morish etc. competition has increased. Also, the Indian market is witnessing the proliferation of bakery cafe chains in the form of Baristacafe, coffee day, Café Coffee & Monginis etc.

Armed with better technology, know-how and novel ideas, these foreign companies have made rapid inroads into the lucrative market within a very short span of time. Though the demand for bakery products in India has always been on the rise, there is clearly a lack of awareness and the will to break new ground, which has helped global players to gain brownie points while exploring the market in India. The unorganized sector accounts for about half of the total biscuit production estimated at 1.5 million tonnes. It also accounts for 85 per cent of the total bread production and around 90 per cent of the other bakery products estimated at 0.6 million tonnes. The last includes pastries, cakes, buns, rusks and others.

History

Pineapple was discovered a little later in time than expected. It had been a staple of the American diet for years before Christopher Columbus, an Italian explorer, discovered it on November 4, 1493. (www.library.ucf.edu; www. levins.com). That’s when the Guadeloupe Island natives served him and his colleagues this delectable fruit, pineapple. The varieties cultivated at the time were all seedless, and many typical wild cultivars were missing (Collins, 1948), demonstrating the area’s early vegetation. He brought the fruit to Europe. The European travellers were so fascinated by this fruit that they frequently mentioned it in their accounts (Morrison, 1963; Collins, 1960).

It was known as ‘nanas’ or ‘ananas’ by the people of South America (‘ananas’ meant ‘excellent fruit’ in Guarani). People in the area literally cultivated it according to a strict protocol, and they were especially keen to select superior varieties in order to increase fruit yield and quality. They gained a thorough understanding of crop agronomy and production. They also put into practise some of the processing standards that are still in use today around the world (holidayandtraveleurope.blogspot.in). Pineapple wine was made, fibre was extracted, and pharmacological needs such as emmenagogue, abortifacient, antiamoebic, vermifuge, stomach disorders, and poisoning arrow heads were met (Leal and Coppens d’Eeckenbrugge, 1996). In 1980, Antoni and Leal proposed that the pineapple originated in an area further north, between 10° N and S latitudes and 55–75° W longitude, which included parts of north western and eastern Brazil, Columbia, Guyana, and Venezuela. During colonisation, Spanish and Portuguese navigators were instrumental in the distribution and spread of pineapple to all corners of the globe (www.daf.qld.gov.au 2015).

11.1 Introduction
“Homogenization” is the method of mechanical treatment producing a stable emulsion of milk fat and milk serum. Homogenizer is the name given to the equipment employed for this aim. The fat globules in milk range in size from 1 to 20 microns; the average is 4 to 6 microns. The homogenizer reduces the size of the fat globules in milk or cream passing through it. The most of them are less than two microns. After homogenization, no cream line develops on milk; churning homogenized cream cannot generate butter grains. Moreover, milk like cream’s viscosity is changing, which increases the resistance the smaller fat globules face. The increase in viscosity is ascribed to the fact that more milk protein will be deposited on the surfaces of more fat lobules. Homogenizing milk changes its clotting characteristics, so the curd made with rennet or pepsin is supposed to be softer. Because lipolytic enzymes adsorbed on the extra surfaces provided by the more numerous tiny fat globules hydroly fat, homogenized milk or cream may become rancid more quickly than untreated goods. The milk or cream must be pasteurized either right before or right after homogenization to prevent these changes. Usually, the milk is homogenized after main heating and then pasteurized. Driven via a small valve against hard surfaces, heated milk is under pressure of 2500 psi and in a second stage under 500 psi. With a 1/10000 inch diameter, the aperture the liquid is driven through is quite small. Mechanical force milk through a narrow passage at high speed produces homogenized milk. This produces a stabile fat emulsion and breaks down the fat globules in milk into considerably smaller ones. Homogenization reduces the inclination of the fat globules to cluster and merge into cream. Milk is an emulsion whereby fat globules are distributed across a constant skim milk phase. Raw milk left to sit will finally cause the fat to climb to the top and form a cream layer. By means of a small opening under high pressure, homogenization mechanically breaks down the fat globules. While increasing their number and surface area, this lowers the average size of the fat globules. Practically speaking, the net effect is a substantially decreased inclination for creaming of fat globules. Three elements contribute to this increased stability of homogenized milk: a decrease in the mean diameter of the fat globules (a factor in Stokes Law), a decrease in the size distribution of the fat globules (causing the speed of rise to be similar for most globules such that they do not tend to cluster during creaming), and an increase in density of the globules (bring them closer to the continuous phase) owing to the adsorption of a protein membrane. < Heat pasteurization also breaks down the cryo-globulin complex, which often clusters fat globules causing them to increase. The homogenizer consists of a high-pressure pump with an adjustable opening based on a minute orifice. High pressure force of fluids through the orifice causes a notable change in the physical characteristics of the treated product and generates a very intimate combination of the fluid components. 1. Introduction

Raw milk is an emulsion. It is a mixture of milkfat globules, Solid Not Fat (SNF) and water. Over time, milkfat globule separate out from milk serum and comes to the surface of milk as a layer of cream due to the low density of milkfat or due to heating of milk. When milk is heated rapidly and continuously, some of the water in it evaporates from the surface. This exposes proteins and fat molecules, which bind and dry out and forms a skin like film on the surface. 

The number of hormones secreted by the body exhibits control over the physiological regulation of glucose sugar level (homeostasis) in the manner needed by the body. Depending upon the situation, hormones may increase or decrease the level of glucose sugar present in the blood or tissues. The glucose is oxidized to yield energy, carbon dioxide, and water.
Glucose, more than the body’s needs, is stored or converted mainly to glycogen and, to some extent, protein and fat. If glucose is less than the need of the body, its denovo synthesis takes place from amino acids or fatty acids, or is formed from the breakdown of stored glycogen. Various hormones are secreted by multiple endocrine glands to control the blood glucose level. If it fails, it leads to hypoglycemia or hyperglycemia conditions. Gluconeogenesis is not developed at birth in the case of a baby pig. Therefore, hypoglycemia in baby pigs is observed within 2 days of age if starved, leading to hypoglycemia, weakness, confusion, and death.

Hormones may be defined as specific chemical molecules produced in certain specific organs called specialized cells or endocrine glands. They are delivered into the blood stream or some other body fluid in minute amounts by the circulatory system of the body and their they exerts a physiological effect at a site of action remote from its origin, regulating numerous biological activities including growth, development, reproduction, water & electrolyte balance, storage & usage of energy etc.

1. IMPORTANCE

India is bestowed with a varied agro-climate, which is highly favourable for growing a large number of horticultural crops such as fruits, vegetables, root tubers, ornamentals, aromatic plants, medicinal herbs, spices and plantation crops like coconut, arecanut, cashew and cocoa. It has emerged as an indispensable part of agriculture, offering a wide range of choices to the farmers for crop diversification. It also provides ample opportunities for sustaining large number of agro-industries which generate substantial employment opportunities. India has emerged as the second largest producer of fruits and vegetables; with largest producer of coconut, arecanut, cashew, ginger, turmeric, black pepper and tea, among plantation crops.

The changing scenario encourages private investment, to go for Hi-tech Horticulture with micro-propagation, protected cultivation, drip irrigation, fertigation and integrated nutrient and pest management, besides making use of latest post harvest measures particularly in the case of perishable commodities. As a result, horticulture crop production has moved from rural confines to commercial ventures and has attracted youth since it has proved to be intellectually satisfying and economically rewarding. It is essential to appreciate the contribution of horticulture, landscaping and gardening in the hospitality industry. Aesthetic use of horticulture freshens up the atmosphere, enhances the look of the property and creates a lasting impression on guests. It also has a beneficial effect on the health.

13.1 Introduction

Hospitality industry is the second largest industry in the world. It is well diversified and can be chosen as per the interest. Hospitality management involves planning, organizing, directing and controlling human and other resources within the different segments of hospitality industry i.e. lodging, restaurant, travel and tourism, institutional management, recreational management, meeting and convention planning industries. Although, these all are separate but related segments of the hospitality industry and are interrelated to provide good and efficient services to the guests and users. Hospitality industry provides services which are need oriented and differ in various parts of the world as per regions and the traditional styles.

The first building created specifically for hotel was ‘City Hotel’ with 73 rooms at 115 Broadway, New York in 1794. Pallonjee Pestonjee established the very first western-style hotel in India, “The Bristol Hotel” in Mumbai in 1840. According to the report of the department of Tourism, Government of India, at the end of the year 2004, there were 167 Five star hotels with approx. 28,900 rooms, whereas 126 Four star hotels, with 8,831 rooms [2]. To expedite the ongoing process of classification/re-classification of functioning hotels in one to three star categories, five Regional Committees have also been set up in Delhi, Mumbai, Kolkata, Guwahati and Chennai to conduct inspection [3].
