24.1 Introduction
A dairy by-product can be described as a valuable commercial product generated during the production of a primary dairy item. Examples include skim milk, buttermilk, residual ghee, and whey, as depicted in the diagram below. Utilizing these by-products not only enhances plant profitability but also makes essential nutrients accessible to humans while reducing environmental pollution from dairy waste. However, converting these edible substances into non-food items is often unjustifiable, particularly in regions facing milk shortages. Effective management of by-products is crucial for ensuring profitable dairy operations, as every component of milk offers significant nutritional value that should be preserved. Consequently, there is growing global interest among researchers in maximizing the utilization of these by-products. Nonetheless, it’s important to note that while many dairy by-products can technically be processed into useful commodities, feasibility alone does not justify their widespread utilization. If capital and resources are to be assigned to a plan to utilise by-products, their processing must be economically viable. Therefore, it is essential to prioritise the research and development of cost-effective technologies for the improving and utilisation of dairy by-products. Utilizing these by-products enhances operational efficiency, provides essential nutrients for human consumption, and mitigates environmental pollution from dairy waste. However, converting edible materials into nonfood items may not be justifiable, particularly in regions facing milk shortages. Profitable dairy operations depend significantly on effectively managing by-product disposal. Every component of milk should be processed wisely to preserve its nutritional value. Consequently, there is growing global interest among researchers in optimizing the utilization of these by-products. Nonetheless, while it may be technically feasible to process any dairy byproduct into useful goods, it doesn’t necessarily mean it should be done.

Carbohydrates are polyhydroxy derivatives of aldehydes or ketones and undergo all the organic reactions common to the carbonyl groups and hydroxyl groups. The principal milk carbohydrate is lactose. It is a disaccharide. Hydrolysis of lactose with enzyme β-galactosidase yields glucose and galactose.

Lactose is the major carbohydrate present in all types of milk. The first record of isolation of lactose was in 1663, by Bartolettus by evaporation of whey. Milk contains only trace amounts of other sugars, including glucose, fructose, glucosamine, galactosamine, neuraminic acid, and neutral and acidic oligosaccharides.

Lactose plays a significant role in milk and milk products that are

• It plays a major role in the production of fermented dairy products.

• It contributes to the nutritive value of milk and milk products

• It affects the texture of certain concentrated and frozen products;

• It is involved in heat-induced changes in the color and flavor of highly heated milk products.

Status of Lactose

Lactose content varies extensively in the milk of different species. Breed of animal, individuality factors, udder infection, and especially the stage of lactation regulates the lactose content in milk. The lactose concentration in milk decreases gradually and significantly during lactation; this behavior contrasts with the lactational trends for lipids and proteins, which, after a decrease during early lactation, increase significantly during the second half of lactation. Lactose synthesis is hampered during mastitis. Lactose, along with sodium, potassium, and chloride ions, plays the principal role in controlling the osmotic pressure of the mammary system. Thus, any change in lactose content is compensated by a change in the soluble salt constituents. The osmotic relationship between lactose and soluble salts during the secretion of milk partly explains the presence of high lactose in milk with a reduced ash content and vice versa (Table 1).

Milk is the one food for which there seems to be no adequate substitute. It constitutes almost the entire diet for the young of all mammals. Each species produces milk that is especially adapted to the growth of its own young, but milk from one species may be used as food for others. Since animals were domesticated centuries ago, the milk from various species such as cow, buffalo, goat and camel, has been used in the diets of people throughout the world. Only cows milk is of commercial importance in the United States, although small amounts of goat’s milk are sold.

Whole cow’s milk is approximately 88 percent water, 5 percent carbohydrate, 3.5 percent protein and 3.3 percent fat. Its nutrient content varies from species to species, from breed to breed, seasonally and even from the beginning of the milking to the end of the process. In the United States it is cow’s milk that is used commonly as a beverage and in food preparation. Therefore the milk discussed throughout this chapter is cow’s milk.

Types of Enazymes in milk

1. Endogenous and 2. Exogenous.

Three sources of enzyme in milk:

1. The blood via defective mammary cells.

2. Secretory cell cytoplasm. Some of which are occasionally entrapped with fat globules by the encircling MFGM.

3. The outer layer of MFGM is probably the principal source of endogenous enzymes in milk. The outer layer of MFGM is derived from the apical membrane of the secretory cell which in turn originates from the Golgi membrane and acts as the principal source of enzyme in milk.

General Characteristics of Milk Enzymes

1. Deteriorative character e.g. lipase (commercially most important enzyme in milk), proteinase, acid phosphatase, xanthine oxidase.

2. Preservative enzymes. e.g. superoxide dismutase, sulfhydryl oxidase.

3. As an indicator of the thermal treatment history of milk. Related enzymes are alkaline phosphatase, ϒ glutamyl transpeptidase, and lactoperoxidase.

4. Mastitis infection indicator. Related enzymes are catalase, n-Acetyl-β D-glucosaminidase, and acid phosphatase.

5. Antimicrobial activity.

6. Commercial source of ribonuclease and lactoperoxidase

Common Milk Enzymes and their Role in Dairy Industry

Abstract

Vitamin D or “sunshine vitamin” is an essential fat soluble vitamin required for healthy bones. It is responsible for enhancing intestinal absorption of calcium and phosphate. Its deficiency leads to osteoporosis and osteomalacia in adults and rickets and other bone deformities in children. Vitamin D deficiency is being reported to be quite common these days due to modernization accompanied with changes in lifestyle and environmental pollution which limit sun exposure for several individuals. Inadequate sun exposure results in reduced vitamin D synthesis and ultimately poor vitamin D status necessitating compensation through dietary intake. Dietary vitamin D intake is very low in India because of low consumption of vitamin D rich foods, absence of fortification and little use of supplements. It is becoming a major public health problem, needing immediate attention. Fortification of milk and milk products is the safe and effective approach to deal with widespread vitamin D deficiency as milk is consumed and liked equally by all age groups. This paper highlights the importance, sources, recommended allowances and other relevant issues related to vitamin D fortification and its health effects.

Homogenization is now a widely used industrial process in dairy production, essential for stabilizing milk and other liquid dairy products. Its main purpose is to prevent fat from separating out of the milk, ensuring a smooth, consistent, and uniform product. Milk is a complex emulsion comprising water, fat, proteins, carbohydrates, minerals, and vitamins. Among these constituents, fat plays a critical role in determining the texture, flavor, and overall sensory quality of milk and dairy products. In its natural state, milk fat exists in the form of globules of varying sizes, surrounded by a thin membrane that stabilizes them in the aqueous phase. These fat globules typically range in size from 2 to 10 μm and have a lower density than the surrounding water-based phase of milk. This difference in density causes the fat globules to rise and form a cream layer when milk is left undisturbed, leading to an uneven texture and separation during storage.
Homogenization is a mechanical process applied to milk to modify fat globules by forcing the milk under high pressure through a tiny orifice. This reduces the average size of the fat globules while increasing their number and surface area. Practically, this greatly minimizes the tendency of fat globules to rise and form a cream layer. The enhanced stability of homogenized milk is due to three key factors: the reduction in the average diameter of fat globules, as described by Stokes’ Law, which slows their upward movement; the uniformity in size distribution, which ensures globules rise at similar speeds, preventing clustering; and the increased density of fat globules caused by the adsorption of a protein membrane, bringing their density closer to that of the surrounding liquid. Additionally, heat pasteurization complements homogenization by breaking down the cryo-globulin complex, which otherwise promotes clustering and cream formation.
The smaller and uniformly dispersed fat globules create a smoother, creamier texture and enhance the mouthfeel. This process also contributes to the visual appeal of milk, making it appear whiter and more uniform. Homogenization is, therefore, an essential step in modern dairy processing, ensuring the stability, quality, and consistency of milk and other dairy products, while addressing the challenges posed by the inherent properties of milk fat and its lower density.

The first use of milk in a solid chocolate product is commonly attributed to Daniel Peter in 1875. Milk chocolate is the most popular type of chocolate, and milk ingredients are critical in delivering the highly desired properties and taste profile to consumers. Milk ingredients also have a significant effect on chocolate processing.

Milk is one of the most complex raw materials used by the food industry. A typical bovine whole milk has a solids content of about 13.5%, comprising about 3.4% protein, 4.6% fat, 4.7% lactose and 0.7% minerals.

Introduction

There are manypeople all over the world who have a certain level of sensitivity or intolerance towards milk and milk products. The reactions to milk which involve the immune systemare termed as milkallergy, whereas, difficulty in the digestion of the milk and milk products is known as milk intolerance. Milk intolerance occurs due to malabsorption of milk sugar (lactose) in intestine, a condition in which lactose is not digested into its monomers (galactose and glucose) due to lower activity or insufficiency of lactase enzyme. Inability to digest lactose, which is a disaccharide present only in milk, is specifically known as lactose intolerance. However, hypersensitivity involves the adverse immune reaction(allergic reaction) inthe body causeddue to the ingestion of milk proteins. Milk and milk products are major source of basic as well as essential nutrients and cannot be skipped from the diet of the individual. It is a rich source of calcium,which is essential for the growth and reformationof bones. The decline in calcium may lead to thin, fragile bones that break easily, a condition called osteomalacia or osteoporosis in women. Thus, it is a matter of concern for both children andadults whoare allergic or intolerant towards milk and milk products and not getting enough calcium and other nutrients in diet. This chapter would provide more insight about milk intolerance and milk allergy/hypersensitivity and how to deal with it.

India

Milk legislation and regulations are designed to prevent fraud and adulteration. But they now cover many factors that affect sanitation and public health. Milk generally is classified into grades according to the care with which it is produced.

Milk lipids or milk fats exist as an emulsion of small spherical droplets called milk fat globules. These globules are very small in size but very large in number. The diameter of the milk fat globules ranges between 0.1 and 22 µm and the number varies between 1.5 and 3.0 billion globules/mL. The average size of milk fat globules ranges from 2 to 5 µm. The average fat globule size in cow and buffalo milk are 3.4 and 4.5 µm, respectively. The surface of the milk fat globules is coated with an adsorbed layer of material known as the milk fat globule membrane (MFGM). MFGM contains phospholipids and proteins in a complex form. MFGM has two main functions (a) fat globule stabilization and (b) preservation of the fat globule’s identity.

General Composition

Triacylglycerols (triglycerides) represent 97–98% of the total lipids in the milk of most species. The diglycerides probably represent incompletely synthesized lipids in most cases. Although phospholipids represent less than 1% of total lipids, they play an important role in being present mainly in the MFGM and other membranous material in milk. The principal phospholipids are phosphatidylcholine, phosphatidylethanolamine, and sphingomyelin. Trace amounts of other polar lipids, including ceramides, cerebrosides, and gangliosides, are also present. Phospholipids represent a considerable percentage of the total lipid of buttermilk and skim milk reflecting the presence of proportionately larger amounts of membrane material in these products.

The primary objective of dairy plant hygiene is to ensure the consistent daily turn-out of safe and clean products which comply with pure-food and public health laws. A secondary and commercially important aim is to preserve the keeping quality of dairy products and so enhance consumer confidence in them. An integral part of a dairy is the quality control laboratory. Continuous testing is necessary for many purposes, including equipment hygiene. Bacteriological standards of dairy products can be maintained only if the raw product is of good bacteriological quality and is protected against contamination from the equipment with which it comes in contact during all stages of processing. 
Many factors may influence the maintenance of dairy equipment in a hygienic condition; the most important are the dairy buildings, the materials and construction of the equipment, personnel, water supply, cleaning procedures, and laboratory control. It is quite impossible to place these points in order of importance, efficient control of dairy plant hygiene being dependent on proper attention to all factors.

10.1 Introduction

Milk is a unique substance in that it is both consumed, as fluid milk with minimal processing and it is the raw material used to manufacture a wide variety of products. From the nutrition point of view, milk is an almost ideal food and considered to be perfect food. The human body needs more than thirty distinct materials in its food supply. No single food stuff supplies all of them but milk supplies nearly all. Since milk by its nature is perishable and an ideal product for bacterial growth, so it must be carefully handled, both during production and while processing. This chapter focuses on the technological (processing) aspects of the transformation of milk into its various consumer products, including beverages, fermented products, concentrated and dried products, butter and ice cream.

Milk production in India is a subsidiary activity of agriculture in contrast to the organized dairy sector in the western countries. Farmers and landless labour maintain one to five milch animals. As a result, small quantities of milk are produced in a scattered manner. Due to this reason, milk procurement models from western countries, such as bulk cooling and bulk transportation are not applicable under Indian conditions. Collection of small amounts of milk is scattered over long distances and, therefore, poses a formidable challenge in maintaining the quality attributes and keeping costs down.

3.1. Rural Milk Collection

A systematic approach to rural milk collection suitable for the tropical climate and techno-economic conditions prevailing in India has been developed, based on the indigenous experience gained over the past few decades. In the first phase, extensive surveys are undertaken in the milkshed areas, where the milk plant is to be established. The second phase involves ‘route planning’ taking into account, availability of quantities of milk, access to roads for plying vehicles and distance from the site of dairy plant. Then zones are identified, representing equal costs of collection and transportation. In the third phase, planning is done for locating the primary collection centres as well as chilling centres, where, milk can be cooled to 4ºC before transporting to the milk plant. Milk may be collected from individual producers either by the contractor or by forming village level cooperative societies.

Bovine milk contains an average of 3.5% protein. The concentration of protein changes significantly during lactation. The first few days of lactation exhibit the main change in protein concentration. The main changes occur in whey protein fraction.

Distribution of Protein in Milk

80% casein and 20% whey protein (β lactoglobulin- 10%, α- lactalbumin- 5%, serum albumin, and immunoglobulin- 5%).

Fractionation of Milk Proteins Fractionation of milk protein is mainly done by acidification at pH 4.6 around 30 °C.

Almost 80% of the bovine milk protein precipitates at pH4.6, and this fraction yielded by precipitation is called casein.

The remaining soluble part of the protein is referred to as whey protein/serum protein/ non- casein protein. Wide variation is observed in the casein- whey protein ratio in different types of milk(protein synthesis is independent of animal diet)

Significant Difference Between Casein and Whey Protein

1. Casein precipitates at pH 4.6 but does not precipitate whey protein at that pH. This property of milk protein is commercially exploited for the preparation of industrial casein and certain varieties of cheese.

2. Chymosin or other proteolytic enzymes produce specific changes in casein resulting in coagulation in the presence of calcium. Whey protein does not undergo this type of coagulation.

3. Casein is very stable to high temperatures. They can withstand heating up to 140 °C for 20 minutes but whey protein is relatively heat labile. They are completely denatured by heating at 90 °C for 10 min.

4. Casein is a phosphoprotein containing an average of 0.85% phosphorous while whey protein does not contain any phosphorous. The phosphate of casein is an important contributor to remarkably high heat stability and calcium- induced coagulation of rennet- altered casein.

5. Casein contains very low sulfur (0.8%) whereas whey protein is relatively rich in sulfur (1%). The principle casein contains only methionine but whey protein contains a significant amount of cystine, cysteine, and methionine. These sulfur- containing amino acids are responsible for many changes in milk on heating.

6. Casein is synthesized only in the mammary gland and no other sources in nature. Some of the whey proteins β lactoglobulin, and α- lactalbumin are synthesized in the mammary gland but bovine serum albumin and immunoglobulin are not synthesized in the mammary gland but derived from blood.

7. The whey protein is dispersed in solution and has a simple quaternary structure. Casein has a complex quaternary structure and exists in milk as large colloidal aggregates.

The salts of the milk include those constituents that are present as ions or in equilibrium with ions. The main salts of milk are phosphates, citrates, chlorides, sulfates, carbonates, and bicarbonates of sodium, potassium, calcium, and magnesium. Approximately 20 other elements are found in milk in trace quantities including copper, iron, lead, boron, manganese, zinc, iodine, etc. These ions are more or less associated with themselves and with proteins. Some metals act as catalysts in the oxidation of milk fat leading to oxidative rancidity and certain metals like Ca, P, Mg, Mo, Co, Fe, etc. are components of metalloproteins such as lactoferrin, lactoperoxidase, xanthine oxidase, and parts of phospholipids.

Distribution of Salts Between Casein Micelles and Serum

The phosphorus is present as orthophosphate, but part of it is bound to organic components like serine and threonine residues of casein, molecules of hexoses and glycerol, phospholipids, etc. Phosphorus is also found in the hydroxyapatite structure of the colloidal calcium phosphate in the micellar structure of casein. The sulfur content of milk is about 0.36 g/kg, but most of it is in the amino acid residues methionine and cysteine of the proteins. About 10% is present as inorganic sulfate.

Physical Equilibria Among Salts

Milk contains several elements but all of them are not entirely in a soluble state. Some minerals exist in colloidal and ionic states at the normal pH of milk. The compounds that are in soluble condition play an important role in keeping various milk constituents in stable condition. A balance exists between the components that are in a soluble state and those which are in colloidal state.

Milk contains approximately 86% water, 4.7% sugar (lactose), 4.1% fat, 4.2% protein and 1% minerals. It supports the growth of micro-organisms and thus is prone to contamination. The purpose of milking a dairy cow is to obtain milk that is fit for human consumption. Milk from the udder of a healthy cow contains very few bacteria and to ensure that it remains fresh for long it should be handled under conditions of good hygiene. Unclean milk can be a source of disease to the consumer, rejected at the market and so is a loss to the farmer, does not keep for long and is not good for processing.

Millets or nutri-cereals are the ancient grains which have now regained the interest of the scientific community as the super grains. These exhibit excellent nutritional and technobiofunctional profile apart from exhibiting tolerance to biotic and abiotic stresses. The millets are gluten free and show high in vitro protein digestibility, resistant starch content, antioxidant and prebiotic potential providing health benefits for all age groups ranging from paediatrics to geriatrics. The presence of certain anti-nutritional factors can lower the bioavailability of proteins and minerals. Processing enhances the nutritional and functional properties by increasing the antioxidant content and lowering the antinutrients. Different value added products can be prepared by incorporating millets thereby enhancing the nutritional and functional attributes. It is necessary to bring millets into regular consumption by the food industry in the interest of nutritionally and health-conscious consumer.

1. Introduction Millets, also known as “smart crops” or “miracle grains,” are a group of small-seeded, hardy cereal crops that have been cultivated for millennia. They are used as a staple food in many of the countries particularly located in arid and semi-arid regions. Millets have been overshadowed for quite a long time by commonly consumed cereals like wheat, rice, and maize. Nevertheless, they have made a remarkable comeback in our cuisines owing to the growing awareness and recognition of the numerous benefits at individual and environmental level. These small, drought-resistant grains play a pivotal role in addressing some of the most pressing global issues like food security, malnutrition and climate change.

Millets are a type of minor cereals found in the Poaceae family. Millets are often described as “Nutri-Cereals” since they contain more nutrients than commonly produced main cereals. They are an important part of human’s diet in the world. These are foods with a high nutritional content, gluten-free and have nutraceutical qualities. The adequate amount of protein (essential amino acid), micronutrients and phytochemicals are found in millets. The phytochemicals found in millet grains enhance human health by lowering cholesterol and phytates in the body. Millets are full of antioxidants, minerals including dietary fibre, iron, calcium and magnesium that are vital for battling a variety of diseases. These are beneficial to include in our daily diet because the grain is healthy and nutritious. They decrease blood pressure, prevent cancer and lessen the chance of tumour growth. The rich nutrient content in millet has many health advantages such as cancer, obesity, lower risk of cardiovascular disease, gastrointestinal issues, migraines and asthma. People utilise millet-based products to fight a variety of nutritional deficiencies and diseases.

Millets which are also known as “Shree Anna” are a type of grass with small seeds that belongs to the Poaceae family and are widely grown throughout the world. Millets have high levels of proteins, minerals, vitamins, and antioxidants that why they are known to be climate-change-resilient crops. Proteins are essential amino acids that the body cannot synthesize and are used as a nitrogen source during embryo development following germination. Millets are high in dietary fibre and are important staple crop in many parts of the world. They are versatile grains that can be used to make a variety of food products, including millet flour. Millets are good for cardiac health, weight management, antioxidant activity, and may have anti-cancerous properties. They are nutrient- dense, provide sustained energy, and contain antioxidants such as polyphenols and flavonoids. Millets are considered safe and have a variety of health benefits. Surprisingly, millets perform major non-millet cereals in terms of nutrition. They are particularly high in dietary fibres, minerals, antioxidants, phytochemicals, and polyphenols, all of which have broad-spectrum positive effects on human health.

INTRODUCTION

Fruits and vegetables are historically important constituents of human diet and the growing awareness of consumers about the beneficial effects of these commodities could result in enhancement of global trade involving fresh and processed fruits and vegetables. Emergence of postharvest handling of fresh fruits and vegetables facilitated global trade of these commodities. The developed countries started realizing the export potential of these commodities by development of adequate value addition in terms of pretreatments, shelf life extension and packaging besides grading and other associated packing house operations. However, the trade concerning fresh fruits and vegetables could never come out completely from problems related to pesticidal residues, spoilage, bulkiness of the commodities involving transportation of inedible portions and excessive packaging costs arising out of bulkiness. The other problems associated with fresh produce include mandatory requirement of specific storage temperatures with refrigeration as the primary means of regulation of metabolic rate.

Minimally processed fruits and vegetables are products that have the attributes of convenience and fresh like quality. Their forms vary widely, depending on nature of unprocessed commodity and how it is normally consumed. In many cases, minimally processed product is raw and cells of tissues are alive, but these characteristics are  not regarded as essential. It is important that products have fresh-like character, regardless of   state of cells.  Minimally processed products for both retail and food service applications have increasingly appeared in market place recently.  In coming years, it is commonly perceived that this industry will have unprecedented growth.

Today’s society is characterized by an increasing health consciousness and growing interest in the role of food for maintaining and improving human well-being and consumer health. Due to consumer’s profile being ‘‘rich in cash/poor in time’’, there is a demand for ready-to-eat products As a result of changes in consumer attitudes, the market of minimally processed (MP) fruits and vegetables has grown rapidly. In addition to their nutritional and sensory properties, foods are currently recognized as active and protective agents. Among the others, minimally processed products stand out as convenient novel foods that fit the many needs of a modern lifestyle as they combine technical content with an innovative food concept. Fresh fruits and vegetables are an essential component of a healthy diet, able to decrease the risk of cardiovascular diseases and cancer. Their consumption has continued to grow rapidly, linked to the increased public awareness of their health benefits.

Minimal Processing’ (MP) is a concept describing approaches to food safety and preservation that are designed to retain the natural and as-fresh properties of foods. Minimally processed fruits are new forms of product marketing, intended to meet the consumers’ desires for convenience and fresh-like quality. Minimally processed fruits and vegetables, also called ready-to-use, fresh-cut or pre-cut produce, are raw fruits and vegetables that have been washed, peeled, sliced, chopped or shredded into 100% usable product that is bagged or packaged to offer to the consumers high nutrition, convenience, and flavour while still maintaining its freshness.

Introduction

In this modern era, educated and health-conscious people are increasingly demanding such food products that preserve their nutritional value, retain a natural and fresh colour, flavour and texture, and free from chemical preservatives. Besides, urbanization has extensively affected the life-style of people all over the world. Competition has made their life extremely busy and time has become a very important factor. Hence, recently there has been increase in demand for ready-to-cook or ready-to-use fresh food products of fruits and vegetables along with convenience and safety. This new demand by consumers has opened a new avenue of food preservation known as minimal processing. The products prepared by this processing method are known as fresh cut or pre-pared products. Minimally processed products are also known as lightly processed, partially processed, fresh processed, fresh cut, and pre prepared. It can be defined in many ways for example as "least possible treatment to achieve a purpose". A more specific definition is as the method that "preserve foods but also retain to a greater extent their nutritional quality and sensory characteristics by reducing the reliance on heat as the main preservative action. In a broader way it can also be defined as the processed foods have been slightly altered for the main purpose of preservation but which does not substantially change the nutritional content of the food. Generally minimal processing involves cleaning, washing, trimming, coring, slicing, shredding before packaging and storage at specific temperature. Some of the examples of minimally processed fruits and vegetables include sliced mango cheeks/melons/papaya/apple, pieces of pomelo segments, peeled and cored pineapple, chilled peach, pomegranate arils dressing, shredded lettuce, shelled peas, cauliflower florets, peeled sliced potatoes, diced onion etc. Minimally processed products are important to food service industry such as eateries and catering companies as they offer many advantages over traditional products, with respect to convenience, expense, labor, and hygiene. Even if it is very much liked by people, the production of minimal processed products is limited due to rapid deterioration and short shelf life. Whereas most food processing methods stabilize the products and prolong their shelf-life, minimal processing of fruits and vegetables increases their perishability.

Tamarind (Tamarindus Indica)

Introduction

The fruit of tamarind a pod 5 to 15 cm long, 3 to 10 seeds surrounded with edible pulp which is principal souring agent for sauces, chutney, in beverages and in general cooking. Pulp is carminative, laxative, given as infusion in biliousness and febrile conditions. It is also used in dyring and tanning and for polishing and cleaning metal ware. The tartaric acid is extracted from unripe fruits. The polysaccharide (jellose) is extracted from seeds, which is used as a sizing material in the cotton and jute industries. Besides, polyose obtained from the seed is good substitute for fruit pectin in the preparation of jam, jelly or marmalade. The bark and leaves are used for tanning. Tamarind balls are prepared after taking out seeds from the fruit. Tamarind paste and tamarind juice concentrate are the other commercial products.

The fruits, flattish, bean-like, irregulary curved and bulged pods, are born in great abundance along the new branches and usually vary from 2 to 7 in long and from 3/4 to 1 1/4 in (2-3.2 cm) in diameter. Exceptionally large tamarinds have been found on individual trees. The pods may be cinnamon-brown or grayish-brown externally and, at first, are tender-skinned with green, highly acid flesh and soft, whitish, under-developed seeds. As they mature, the pods fill out somewhat and the juicy, acidulous pulp turns brown or reddish-brown.

High Pressure Processing (HPP) is a method of food processing where food is subjected to elevated pressures (up to 87,000 pounds per square inch or approximately 6,000 atmospheres), with or without the addition of heat, to achieve microbial inactivation or to alter the food attributes in order to achieve consumer-desired qualities. Pressure inactivates most vegetative bacteria at pressures above 60,000 pounds per square inch. HPP retains food quality, maintains natural freshness, and extends microbiological shelf life. The process is also known as high hydrostatic pressure processing (HHP) and ultra high-pressure processing (UHP).

    ·    Abscesses should be examined by a veterinarian as soon as possible and within 24 hours.
 
    ·    Fluid may normally drain from the site of an abscess. An abscess does not drain through the tube, but rather around the latex tubing. Therefore, it is important for you to clean the area around the drain twice daily with warm water.

    ·    Apply a hot compress to the affected site at least two times daily for 3 to 5 days after the animal leaves the hospital. Wet a clean washcloth with very warm water and place it directly over the affected site, and then apply gentle pressure ideally for 5 to 10 minutes.

SYNOPSIS

Food and nutritional challenges continue to be tackled in East and Southern African countries. Prevailing rates of high malnutrition among children and often in adults in vulnerable geographical locations do suggest the need for appropriate interventions. Of several global nutrition interventions during the 1980s, successful implementation of nutrition programmes in Tanzania, Uganda, Malawi and Ethiopia have established strategies / approaches that are promising.  In Tanzania, the Iringa nutrition programme (WHO/UNICEF Joint Nutrition Support Programme) was implemented during 1983-1988.

The quality of ice cream depends on the balanced interaction of its major and minor constituents. This chapter examines ice cream mix as a multiphase system and explains the chemistry and functionality of its principal components. Milk fat, milk solids-not-fat, proteins, lactose, sugars, stabilizers, emulsifiers, water, and other constituents are considered in relation to body, texture, flavour, viscosity, freezing behaviour, and stability. The chapter also discusses minor milk constituents and the ways in which individual components interact rather than functioning independently. Understanding these relationships helps manufacturers identify formulation-related defects and optimize composition for desired sensory, processing, nutritional, and storage characteristics.

The selection and management of ingredients are fundamental to producing consistent, safe, and high-quality ice cream. This chapter provides an overview of the principal ingredients used in ice cream mixes and explains their selection criteria, approximate composition, functionality, storage requirements, and handling practices. It considers dairy ingredients, sweeteners, stabilizers, emulsifiers, flavours, colours, inclusions, and other formulation components. Ingredient quality directly influences processing performance, sensory properties, shelf life, and product cost. The chapter also highlights incoming-material quality checks and common ingredient-related defects. By understanding ingredient functionality and quality specifications, manufacturers can improve formulation accuracy, process consistency, product performance, and overall manufacturing efficiency.

1. Introduction

Mixing is a fundamental and widely practiced operation in many fields, such as chemical, pharmaceutical, and food processing industries. The mixture’s primary aim is to increase the homogeneity of the material in bulk (Uhl and Gray, 1986; Patterson et al., 2004). Mixing means the random distribution of two or more ingredients throughout a system, which differs from the term’ agitation,’ which is defined as establishing a particular flow pattern with the liquid, especially in a circulatory motion within a container. Mixing is a necessary step in the context of food processing operations.

    ·    Freshly calved animals in 1st or 2nd lactation are purchased in two batches of five animals each at an interval of 5 to 6 months.

    ·    Cost of rearing calves not considered as it will be nullified by their sale value or retention value.

    ·    Fodder cultivation considered in two acres and working capital for one crop / season considered. Two crops considered per year.

Abstract

The increasing interest in polyphenolic compounds in industries has led to the exploration and exploitation of rich bio-compounds from natural sources, essentially plants and their by-products. Solid-liquid extraction is mostly applied for the recovery of these valuable compounds from plants. Since the extraction process is often difficult in a fresh matrix, a drying operation is needed to reduce the moisture content, and preserve the targeted valuable compounds. An uncontrolled drying operation will lead to product damage and hence, loss in quality, reason why, several studies have been carried out to understand and control the drying process. The present chapter aims to present some data on drying for bioactive compound recovery from plants and their by-products, mainly polyphenolic compounds. Our main interest is the mathematical tools used to model the drying process.

Abstract

There are several empirical models to describe deep bed drying dividing the domain into many thin layers. Empirical equations are seen as a resource that only serves to describe the thin layer drying kinetics of an agricultural product. Normally an empirical model is used to determine drying rate. The validity of following thin-layer drying models are accounted by coefficient of correlation (R2), standard error of estimated (SEE), root mean square error (RMSE). The properties of dried foods vary substantially depending upon the type of product, moisture content, drying type and ultimately drying conditions. To take care all above variables, a promising approach is to use Artificial Neural Network (ANN). In process control, the main objectives are food safety, high quality and yield at minimal costs. To obtain high quality products, on-line control techniques are required. Most food processes are highly nonlinear, with time varying dynamics, which complicates food automation. However, the recent developments in artificial intelligence based advanced control tools such as ANN to food processing have opened up novel possibilities for processing industries.

Plantbreeding is an ancientart practiced throughselection ofplants fordesirable traits. Over a period of time it has evolved into scientific discipline with various methodologiesbasedon theories and principles ofgenetics. Since the rediscovery of Mendel’s law, there has been accelerated increase in yield of various crop plants due to development of high yielding varieties. Conventional approaches of following phenotypic selection from a variable population in early generation followed by yield testing in later generations have been highly successful in most of the crop species. This coupled with hybrid varieties led to significant increase in food-grain production during later half of the 20^th century. At present manycrops are facing yield plateau asthey have reached their maximum genetic potential. The growing condition is also deteriorating due to changing climate. There is an urgent need among breeders to utilize full arsenal of techniques available to them to sustain crop productivity. Molecular markers and marker assisted selection has come as a boon to the breeders to increase the efficiency ofselection in early generation breeding especially for traits whose phenotypic evaluation is difficult. Further, transgenic technology has the potential to incorporate genes from diverse sources, thus enriching the gene pool from which breeders can search for specific traits. Although at present there is skepticism about transgenic crops among public but this may become a viable strategy in future.

Meat processing is the set of methods and techniques used to bring substantial chemical and physical changes in the natural state of meat. These are the methods which are used for making meat and their products attractive, nutritious and marketable as well as for the prolongation of shelf-life. In processing techniques, grinding, chopping, addition of seasoning, alteration techniques for colour, heat treatments etc. are included but cutting, trimming and deboning are not included in processing operations.

History

Meat processing dates back to the prehistoric ages and probably the first processed meat product was sundried meat. Lator it turns to burning of meat over wood fire while salting and smoking of meat was practiced first time in the time of Homer, 850 B.C. In 63B.C.-14 A.D. at the reign of Augustus honey was tried for preservation of meat. Lator various types of cooking such as roasting, smoking, steaming and oven baking came in existance. Salt-preservation was especially common for foods including meat and meat products for warrior and sailor’s diets, until the introduction of canning methods.

Modern food processing technology in the 19th and 20th century was largely developed to serve military needs. In 1809 Nicolus Appert invented a vacuum bottling technique that would supply food for French troops and this contributed to the development of tinning and then canning by Peter Durand in 1810. Although initially expensive and somewhat hazardous due to the lead used in cans. Canned goods would later become a staple around the world. Pasturization discovered by Louis Pasteur in 1862 was a significant advance in ensuring the micro-biological safety of food. In 20^th century, food processing advances with the development of spray drying, freeze drying and the introduction of artificial sweeteners, colouring agents and preservatives such as sodium benzoate. In late 20^th century ready to eat meat food products were introduced to cater the need of consumers.

The paddy grain contains a rough outer covering called husk. It accounts for about one-fifth to one - fourth of the weight of paddy. The inner kernel, called brown rice or dehusked rice, again contains some soft outer layers, jointly called bran. It accounts for about 6-8% of the brown rice weight, including the small germ (1-2% by weight) located in one corner. Rice milling is the process of removing the husk and a part of the bran from paddy in order to produce edible rice. Rice milling system ranges from the home-scale to the large, complex modern rice-processing installations. They include hand-pounding equipment, single hullers, emery sheller-cum-huller mills, emery sheller-cum-cone polisher mills and the modern rubber – roller rice mills. Rice milling industry does not only mill rice but it also carries many other essential functions, such as cleaning and grading, drying, storage, quality control etc. for the production of better quality rice. All these processes are discussed in this paper.

Unlike other food grains, rice is mostly consumed as cooked whole grain, Milling technology is therefore geared to obtain maximum outturn of milled rice and to reduce breakage to the minimum. The single huller mills are by and large located in villages or in localities where paddy is custom milled for produces and they still handle the bulk of the country’s production. The large-capacity rice mills located in urban or semi-urban areas for commercial milling are of ½ to 4 tones per hour capacity and handle the rest of the paddy milled. Some battery hullers are still in operation as large commercial mills, specially for milling parboiled paddy.

For Indian foods

Food processing industries are the fastest growing in India. India is the largest producer of milk, bananas, mangoes, guavas, papaya, ginger and okra. It is the second largest producer of wheat, rice, fruits, vegetables, tea, sugarcane and cashew nut. It is the third largest producer of cereals, coconut, lettuce, chicory, nutmeg, mace, cardamom and pepper at the global level (Highlights of Agriculture Census, 2010-11, http://pib.nic.in/newsite/PrintRelease.aspx?relid=132799). Most part of the income is spent on foods. It is important to establish and nurture mutually beneficial relationships with global food processing, food retail and related supply chain organizations. This will in turn help in the realization of significant business growth opportunities in India, through newer technologies, innovations and ways of value additions. The geographical location of India helps in the export of items to other countries. It is connected to Europe, Middle East and Africa from the western coast and to Japan, Singapore, Thailand, Malaysia, Korea, Australia and New Zealand from the eastern coast. Food processing is a priority sector for the Indian Government, especially in recent times with “Make in India” initiative.The country is considered as one of the most favourable markets because of the easy and affordable credit and other fiscal incentives. The total consumption of food and beverages in India is US$ 369 billion which is expected to increase to US$1.142 trillion and the output in the food processing sector might increase to US$ 958 billion by 2025. This offers a vast market opportunity by the Indian food processing, food retail, transport, logistics and related infrastructure sectors to players in the food processing value chain. The market for plant and machinery in the food processing sector is estimated in the year 2024-25 to be USD 51.41 billion as compared to the current value of USD 17.3 billion (2016-17).

Tremendous hike inworld population has increased thrust on the limited resources which has considerably affected the viability of the food. The emerging challenge for policy makers and food scientists is to put forward viable solutions. Utilization of underutilized crops/plants that act as good sources of starch could be explored in a better way for the sustenance of the limited sources like food crops/plants. The demand for starch and the foods containing starch has been increasing continually. Since, the starch in its native form has certain limitations in its functional properties to be used for different applications. Therefore, it becomes important to explore certain technologies which could be used for modification of starch. Among different technologies gamma irradiation ensures food safety while inducing physicochemical changes of the components. Although, the chemical modifications have been used widely so far but the concerns related to the chemical residues left are diminishing their demand. Hence, the physical processes particularly the gamma irradiation process has emerged as an efficient alternative with some benefits over other process like eco-friendly, economical, reliable and safe for altering the physico-chemical and biological characteristics of the product. Gamma Irradiation of starch has been successfully employed for the achievement of some desired physico-chemical, biological and functional properties of the foods and other related items. In this chapter, valuable impact of gamma irradiation on the physico-chemical, biological and functional properties of starch has been summarized.

13.1 Biopolymer-Based Coatings with Antimicrobial Properties 13.1.1 Understanding Biopolymer-Based Coatings Biopolymer-based coatings are a game-changer in food packaging, offering natural, sustainable solutions for food safety. These coatings, derived from renewable sources, like polysaccharides (e.g., chitosan, starch, cellulose), proteins (casein, gelatin), and lipids (wax, shellac), have proven to be biodegradable and consumer-friendly alternatives to synthetic polymers. 13.1.2 Antimicrobial Properties and How They Work • Antimicrobial coatings are crucial in slowing down spoilage and extending the shelf life of perishable foods. They work by disrupting cell membranes, inhibiting cell processes, and creating oxidative stress in microbes. This is achieved through natural antimicrobials like essential oils (e.g., oregano, thyme, clove), plant extracts, and organic acids; inorganic agents like silver nanoparticles, zinc oxide, and titanium dioxide; and microbial-derived substances like nisin, lysozyme, and bacteriocins (Yu, Z et al ., 2022)

Studies have shown that modified atmosphere packaging (MAP), and controlled atmosphere storage have the ability to delay quality losses and thus extend shelf life of fresh or minimally processed or fresh-cut produce (Church 1994; Gil et al. 1996a, b; Lee et al. 1995). Modified atmosphere packaging of fruits can result in reduction of respiratory activity, delay in softening and ripening and a reduced incidence of various physiological disorders and pathogenic infestations (Artés 1993).

9.1. Introduction

In a fast-paced world, demand for pre-cooked, fresh-like, and convenient products without preservatives is increasing. This demand has triggered the need for better alternative packaging materials for food products like MAP (Modified Atmosphere Packaging), CAP (Controlled Atmosphere Packaging), edible packaging, biodegradable packaging, etc. Packaging plays a crucial role in transport, distribution, storage, retailing, and end-use, a means of ensuring safe delivery to the ultimate consumer in sound conditions at optimum cost. It performs the functions depicted in Fig.1 for both fresh as well as processed products (Opara et al., 2007; Opara, 2009).

The shift from vegetative to reproductive phase in plants is the result of multiple gene cascades in response to photoperiodic and temperature dependent pathways, gibberellic acid pathway, vernalization pathway and autonomous pathway. The environmental cues are initially detected in the leaves and the mRNA of the flowering signal integrator FT gene, moving to the shoot apical meristem, acts as a long-distance signal for floral meristem identity. At SAM, FT-FD protein complex, based on signals from above said pathways in association with the signals from age-dependent and miRNA pathways, leads to the activation of master regulator gene of flowering AP1. The activation of genes involved in ABCDE model of floral organ differentiation, based on the directions of various cadastral genes lead to the development of floral organs. Thus, the sequential action of floral meristem identity genes, floral organ developmental genes, floral meristem size and organ number genes, floral organ pattern genes and cadastral genes leads to the flower development. This chapter sums up the gene interactions happening in leaf and SAM, leading to the development of a complete flower.

Introduction

Improvement of wheat grain quality depends on the knowledge of quality requirements of different end-use products and the genetic components controlling different quality traits. In previous chapters we have dealt in-depth with quality requirements of different end-use products and their genetic components. Depending upon the goal of quality improvement, different strategies are adopted to improve wheat quality. It depends upon the number of genes controlling the traits as well as the availability of the simple methods for phenotyping the traits especially during early segregating generations. In addition stability analysis of the traits across the environments is essential before we go for breeding. Constraints in time, cost, and sample availability usually necessitate the use of predictive tests during early generations, followed by milling and baking tests on advanced lines that have met a number of agronomic, disease and predictive quality criteria. Knowledge of germplasm lines having specific quality traits is needed to initiate breeding for the improvement of wheat grain quality for different end-use products. The quality requirements of different major end-use products are provided in the following table (Table 1).

Abstract

The conventional methods of pathogen identification have often depended on identification of disease symptoms, isolation and culturing of the organisms, and identification by morphology and biochemical tests. The major limitations of these culture based morphological approaches, however, are the reliance on the ability of the organism to be cultured, the time consuming nature and requirement of extensive taxonomic expertise. Furthermore, diagnosis of plant diseases can be even more difficult with asymptomatically infected propagative materials such as tree grafting stocks or potato tubers. The use of molecular methods can circumvent many of these shortcomings. Accordingly, there have been significant developments in the area of molecular detection of plant pathogens in the last three decades. The polymerase chain reaction (PCR) which revolutionised molecular diagnostics and biological sciences. In the last decade the range of targets that can be diagnosed using diagnostic PCR have grown tremendously. The very flexibility and application specific variations in the basic theme of the system have allowed the development of many PCR variants adapted to wide range of applications. Furthermore, diagnostic PCR has been greatly improved by the introduction of the second generation PCR, known as the Real time PCR where closed-tube fluorescence detection and quantification during PCR amplification (in real time) is possible eliminating the need for laborious post-PCR sample processing steps which greatly reduces the risk of carryover contamination. Using Real Time PCR, it is possible not only to detect the presence or absence ofthe target pathogen, but it is also possible to quantify the amount present in the sample allowing the quantitative assessment of the number of the pathogen in the sample. Enumerating the pathogen upon detection is crucial to estimate the potential risks with respect to disease development and provides a useful basis for diseases management decisions. Crops can be attacked by many pathogens which, in addition, often occur in complexes. Therefore, many disease diagnostic applications require simultaneous detection and quantification of several targets. Methodological limitations, however, are in many cases the reason for developing simplex or assays designed for only few targets. The DNA Microarray technology, originally designed to study gene expression and generate single nucleotide polymorphism (SNP) profiles, is currently a new and emerging pathogen diagnostic technology, which in theory, offers a platform for unlimited multiplexing capability. It is viewed as a technology that fundamentally alters molecular diagnostics. The fast growing databases generated by genomics and biosystematics research provides unique opportunity for the design of more versatile, high-throughput, sensitive and specific molecular assays which will address the major limitations of the current technologies and benefit plant pathology.
