It serves multiple purposes, such as prolonging the shelf life of products. However, food packaging is not a recent innovation, and its history is quite fascinating. Food packaging has existed in various forms throughout history. The Journal of Agricultural and Food Chemistry highlights that Napoleon played a major role in its development by offering a reward of 12,000 francs for anyone who could invent a method to preserve food for his army. This prize went unclaimed for 15 years until Nicholas Appert introduced the canning method. Appert’s process involved boiling food and sealing it in airtight glass containers, laying the foundation for modern canned food as we know it today.
EVOLUTION OF FOOD PACKAGING THROUGH AGES
The history of food packaging dates back centuries! The Chinese were pioneers in developing paper and wrapping materials, which were utilized for storing food. In ancient Egypt, advancements were made in glass-blowing and molding techniques, allowing glass to be shaped into various forms for food and water storage. Over time, innovations continued to evolve, with figures like Nicholas Appert leading the way. Appert's glass canning method eventually led to the creation of modern metal cans. In the 1880s, the food manufacturer Quaker Oats introduced cardboard cereal boxes as a packaging solution for their oats, further advancing food packaging technology.
Food packaging serves several vital functions beyond simply containing food. Here are Some Key Roles of Food Packaging:
• Preservation: Packaging prevents exposure to air and moisture, which can cause food to spoil quickly. Proper packaging extends the shelf life of food, benefiting manufacturers by reducing waste.

3.1 Introduction

Energy comes in many forms like chemical, radiant, mechanical, electrical, nuclear etc and can transform from one type to another. Energy can also be transferred or moved from one object to another. Electromagnetic (EM) radiation is a form of energy that can take many forms, such as radio waves, microwaves, X-rays and gamma rays even sunlight is also a form of EM energy. Visible light is a small portion of the EM spectrum, which contains a broad range of electromagnetic wavelengths.

Electromagnetic waves, a self –propagating transverse radiation, are created when an atomic particle, such as an electron, is accelerated by an electric field, causing it to move. The movement produces oscillating electric and magnetic fields. The electric and the magnetic components of the wave are perpendicular to each other and also perpendicular to the direction in which wave is travelling in a bundle of light energy called a photon. Photons travel in harmonic waves at the fastest speed possible in the universe: 186,282 miles per second (299,792,458 meters per second) in a vacuum, also known as the speed of light. There are three important characteristics of the electromagnetic radiation, its frequency, amplitude and speed (Figure 3.1).

Cellulose is a homopolymer of β (1–4) glucose linkage. It is the most abundant polymer present on the surface of the earth, which is mainly produced by the vascular plants (Sharma et al., 2019; Dayal et al., 2013; Sheykhnazari et al., 2011). Cellulose obtained from higher vascular plants has been employed for making textile and papers.

1. INTRODUCTION

Fruit production is not only the growing of fruit plants but it is an outcome of well planned orcharding system. The designing of an orchard for successful fruit production depends upon various physical as well as climatic conditions and resources which help in building up of fruit growing systems. An orchard is a long term investment, mistakes committed at initial stage of planning, selection of site and soil reduces the return greatly from investment, beside wastage of time and energy. Thus, a faultless planning with utmost care and attention become quite imperative while planning a new orchard.

2. PLANNING OF ORCHARD

Before undertaking the actual planting of fruit trees, it is advisable to plan the complete process/steps, which will enable the grower to provide not only the most economic orchard management, but also for the economic layout and location of roads, drains, irrigation channels, hedges and wind breaks. For establishing an orchard of fruits, the major consideration must be given to four important aspects like climate, site or location selection, soil condition and basic facilities (economic and market consideration).

1. IMPORTANCE

Nutrients are known to influence each and every physiological process within plant system. A considerable amount of various nutrients has been reported to drain off every year with the yield, pruning wood and fallen leaves from the plant and soil system. Therefore, for successful fruit culture, assessment of nutritional status of an orchard assumes significance. The key to mineral nutrition of any orchard is the judicious application of fertilizers on the basis of leaf and soil analysis. The nutrients requirements of fruit trees may vary from crop to crop and includes the soil as well as foliar application of the required major and micro-nutrients. Low level of nutrient results in low yields which are much below the realizable potential. There are a number of reasons why better nutrient management in horticultural crops deserves serious attention. The nutrition management of fruit crops is important:

1. To obtain higher yields and higher returns.
2. To increase the returns from established orchards.
3. To help improving the nutritional standards of the people by providing adequate supply of fruits and vegetables at affordable prices.
4. To provide greater and better quality raw material for fruit and vegetable processing industries, and
5. To help earning foreign exchange through the export of high quality produce in fresh or processed form.

Introduction

The green revolution which initiated in India during 1960’s to 1980’s was an attempt to overcome the then prevailing threats of food scarcity and lack of foreign exchange. The food scarcity was a result of severe drought which engulfed the country as well as the political situation it had to face after its short period of gaining independence (Reddy, 2010). The only way out to overcome the acute food scarcity was intensive agriculture, with the use of high yielding varieties, chemical fertilisers and pesticides which heavily boosted agriculture production in India. The remarkable increase in production and productivity resulted in non-judicious use of chemical inputs to extract the maximum from the degrading soil. This marked the era of soil, water and air pollution and extreme health hazards to all life forms.

Rachel Carson’s “Silent spring” in 1962 was an insight into the path of DDT the then prevalent pesticide through its effect on the food chain as well as the environment. She was one among the scientists to raise her voice against the indiscriminate use of pesticides. The evident impacts raised concerns over the continued use of chemical inputs (Lairon, 2010). The situation warranted the reduced or limited use of chemicals in agriculture which resulted in an “organic movement”. This caused a slow, but evident shift in the interest of growers and consumers towards organic agriculture for health security, food safety, quality and better returns (Niggli et al., 2007).

This review is an attempt to analyse the various factors affecting the safety and quality of organic food products in comparison with conventional food. Drawing a proper conclusion was a difficult task due to the limited availability of scientific papers published in this aspect, indication of only trends rather than solid proofs and non-revelation of non-significant data regarding related experiments. However, this review could evaluate the positive and negative aspects of organic cultivation and food production from the available data, so as to suggest measures for improving the quality and safety of organic food products.

Introduction

Agriculture is an important sector in Indian economy, 58 per cent of India’s population depends on agriculture for their livelihood. Agriculture is main victim of climate change, it can disrupt availability, accessibility and quality of food. Moreover, increase in temperature, reduction in ground water availability, f looding and salinity are the major limiting factors in sustaining and increasing vegetable productivity. As a result of this crop physiology and production both are affected. Organic farming can help to tackle climate change by reducing greenhouse gas emissions and amount of nitrogen fertilizer applied to farming land. In India we have advantage that the agricultural techniques we practiced before green revolution in our country is eco-friendly and today also it is somehow it is in memories of our older and younger farmer generation. Principle of sustainable farming is the base of organic farming. According to OECD (Organization for Economic Cooperation and Development) “Sustainable agro-ecosystem - agricultural and food systems are economically viable, meet society’s need for food assurance, while they retain and enhance natural resources and environmental quality for future generations” it is very clear from the definition that organic farming mostly emphasizes the environmental aspect and it includes.

Organic meat food products are choice products for health conscious people. These are the products produced mainly in most natural way without using fertilizers, pesticides and growth regulators in their feed and fodders. In addition, meat animals are also reared without growth hormones, antibiotics drugs etc. and grazing of the animals is a prerequisite in organic farming system.

The term organic farming was first time used by Lord Northbourne. The term organic farming was derived from his concept of “the farm as organism”. It is a holistic, ecologically balanced approach to farming. In 1991, the European Commission formulated the first government system to regulate organic labelling. In India, standards for organic agriculture were announced in May 2001 and the National Programme on Organic Production (NPOP) is administered under the Ministry of Commerce. The concept of organic meat food products has been emphasized now a day due to animal welfare point of view, consumer’s conscious ness, less residue level of chemicals, antibiotics and drugs, Bovine spongiform encephalopathy (BSE), Foot and mouth disease (FMD), genetically modified food etc.

Organic meat food products as a whole are dependent on the life stages of the livestock like its origin, feeding, housing, health, breeding, transportation and slaughter. The other factors accounting for organic foods are its production, harvesting, preservation and processing. Inspite of low growth rate of organic red meat globally, growth in dairy, egg and poultry is increasing day by day. At present 1.2 million hectares (0.6%) of Indian land is producing organic products (Willer and Kelcher, 2011).

27.1 Introduction
Processed organic food typically consists of solely organic ingredients. If there are any non-organic components, a specified proportion of the food’s plant and animal ingredients must be organic, and any non-organic ingredients must meet specific agricultural standards. Organic foods should not contain artificial additives and are usually processed using fewer synthetic methods and materials, avoiding practices like chemical ripening, food irradiation, and genetic modification. While synthetic pesticides are prohibited, non-synthetic pesticides are permitted. Milk from cows—or any other animal—serves as a useful environmental indicator for measuring pollutants and pesticides because substances consumed by the animal end up in the milk it produces. If contaminants are present in the grass, they will ultimately be found in the milk.

27.2 Beyond these four main factors have led to the increasing interest by farmers and consumers in organic dairy farming
1. Consumer concerns about food safety and animal welfare
2. Overproduction of food (perceived as low in quality)
3. The environmental effects of intensive farming

Introduction

The hilly states in north eastern India are not only famous for their forest wealth and awesome wild assets. These states are also known for their track record in harvesting specific crops and fruits. Some of the iconic ones are like, “Assam tea” which is famous in and outside India and popularity of “Khasi mandarin” is also well known. The small landlocked state Tripura produces quality pineapples in abundant amounts, where cv. Queen is popular among the growers. Sikkim and other states of north eastern region of India is known for their Organic Farming techniques, which is mostly attributed the nature of hill farming on this region. North-East is rich in horticultural aspect viz., f loriculture with a rich variety of medicinal plants grown there along with various fruits and vegetables. An analysis of NSSO survey data on cultivation practices shows that the North-East hill states have retained traditional practices and show an inclination towards organic agriculture that is harnessed for the development of the region with ecological benefits.

The History of Fish Keeping

Philip Henry Gosse (1810-1888) coined a term “Aquarium” which is now familiar to all of us, in his 1854 book The aquarium: An unveiling of the wonders of the deep sea.

The idea of keeping aquariums can be dated back to 2500 BC and has evolved into a complex hobby that exists today. Ancient Sumerians and Romans kept fish in containers as early as 2500 BC, similar to what we now know as fish tanks. These tanks were designed to keep fish alive long enough to prepare the specimen for food. It is also known that Romans and Babylonians kept ponds filled with fish for ornamental use (History of Fish Keeping as a Hobby).

As time progressed, the art of fish keeping became a “luxury for the rich” (DuHammel 1). Many people consider the Chinese as being the most important contributors to the hobby. “By 1136 AD Emperor Hiau-Tsung started to breed and keep these fish in a more controlled environment. Several new breeds of ornamental fish ornamental emerged.” (DuHammel 1). As more people became involved in the idea of fish keeping, having a goldfish was no longer an indicator of a person’s status. Many common people began to keep goldfish; the fish that they kept represented a good luck charm.

Abstract

Osmotic dehydration is gaining popularity due to several energy and product quality related advantages it offers. It has huge potential as a complementary process step prior to operations such as air-drying, microwave drying, freezing, frying etc, if not an alternative one, in the food process chain. It can be easily integrated with other processing steps in order to improve the overall efficiency of a given food process. Application of additional driving force either prior to or during osmotic dehydration can enhance the mass transfer rates in the osmotic dehydration. Role of mathematical modelling both in osmotic dehydration and rehydration have been discussed. Current limitations for the adaptation of osmotic dehydration in the food processing industry and possible solutions are also discussed in detail.

Introduction

The drying of fruits and vegetables during the season of abundance in order to preserve them for consumption during season of shortage is an ancient practice. Thus, drying is one of the oldest methods of preservation of the food commodities. It is practiced from ancient times and is a very common method of preservation in the tropical countries like India where conditions are much more favorable for sun drying. All micro-organisms need moisture to grow. So the removal of water in the food is brought down below a certain level at which they are unable to grow. Moisture content from food can be removed by different methods like sun drying (very oldest method and most popular), solar drying, cabinet drying, mechanical drying, tunnel drying, poly tunnel drying, adiabatic drying, spray drying, osmotic drying, fluidized bed drying etc. Grains are mostly dried in the sun. The moisture content of the grains can be reduced to a limit that is safer for their storage by sun drying. Many fruits and vegetables can also be dried by using sun energy. Some coastal areas of the countries fishes are also dried by exposing to the sun. After drying, sometimes the dried products are converted into powder. However, these powders are very hygroscopic and should be packed in airtight. Mango powder is prepared by this technique, but expensive and not popular in India. Nowadays many artificial methods have been developed for removal of the moisture. The relationship between the moisture content and temperature of air during process is referred as Psychrometric relation. An instrument used to measure the humidity (Relative humidity) of the atmosphere is known as Psychrometer (Hygrometer). The residual moisture in vegetable should not be more than 6-8% and in fruits it should be in the range of 10-20%. The dried fruit can be used as such or after soaking while dried vegetable are usually soaked in water overnight and then cooked. Vegetable are considered to be dry when they become brittle. There are generally two drying methods for foods like 1) Natural drying and 2) Artificial drying. The preservation / stability of the dehydrated products is conferred by the abstraction of water, so that the product is unable to support the microbial growth, its chemical forms of deterioration is inhibited and the drastic reduction in the weight / volume facilitate easier handling and marketing. Among dehydrated products, dehydrated onions have largest share of 45%. India is the third largest exporter of the onions in the world next to the Netherland and Spain. Besides this, India exports dehydrated bell pepper, garlic and mushrooms.

Overview of the Indian Dairy Sector

India’s dairy sector occupies a unique global and domestic position due to its scale and socio-economic impact. As the world’s largest producer of milk with 230.6 million tonnes of production in 2022-23 (BAHS, 2023), India contributes approximately 23% of global milk production, surpassing countries like the United States and New Zealand (FAO, 2020). This dominance is largely attributed to Operation Flood, the revolutionary initiative launched by National Dairy Development Board (NDDB) in the 1970s, which transformed India from a milk-deficient country to the world’s largest milk producer (World Bank, 1998). Operation flood is known for its contribution in increasing milk production, supplement rural income and make available reasonable prices to the consumers. This initiative laid the foundation for the cooperative model of dairy production, epitomized by the success of organizations like Amul, which became a global model for dairy development (Candler & Kumar, 1998).

Botanically fruits are ripened ovary. It is a plant part that may or may not be purely derived from ovary of the flowers may be fleshy or pulpy in character, often juicy, predominantly sweet. With somewhat acidic taste, fragrance, aromatic flavours, fruits are generally not consumed during principal part of meals. Whereas vegetable is plant part which is less sweet, generally non acidic and consumed either cooked or raw during the principal part of our main meals. Vegetables may be fruit, root, stem flower, or leaf part of a plant or their modification.
Fruits and vegetables are valued in in human diet as an important source of protective nutrients like Minerals and vitamins. Apart from their nutritive value they add variety to the diet and improve acceptability of meal due to presence of different shades of colours, flavours, and texture. However, the major role in food preservation is played by their moisture content. For the same reason they are classified as
1. Perishable: Those which deteriorate quickly after harvesting such as tomatoes, mangoes, papaya, peaches, plums, juicy fruits and vegetables. They have high degree of moisture content and are highly susceptible to spoilage.
2. Semi perishable: These have less moisture content as compared to perishable one’s example 30 carrots, peace, green beans, apple etc. These foods are containing certain natural inhibitors to spoilage.

Introduction

Lipids are among the major components of food of plant and animal origin (food lipid). There is no precise definition available for the term lipid; however, it always includes a broad category of compounds that have some common properties and compositional similarities. Lipids are materials that are sparingly soluble or insoluble in water, but soluble in selected organic solvents like benzene, chloroform, ether, hexane, and methanol. Together with carbohydrates and proteins, lipids constitute the principal structural components of tissues (Erwin Wsowicz et al., 2004). Lipid oxidation is one of the major reasons that foods deteriorate and is caused by the reaction of fats and oils with molecular oxygen resulting in off-flavours that are generally called rancidity. Exposure to light, pro-oxidants and elevated temperature will accelerate the reaction (Velasco, J et al., 2010). Rancidity is related to characteristic off-flavour and odour of the oil. There are two major causes of rancidity. One occurs when oil reacts with oxygen and is called oxidative rancidity (Ribeiro et. al., 1993). The other cause of rancidity is by a combination of enzymes and moisture. Enzymes like lipases liberate fatty acids from the triglyceride to make di and monoglycerides and free fatty acids and such liberation of free fatty acids is named hydrolysis. Hydrolysis is additionally caused by chemical process that’s prompted by factors like heat or presence of water. Rancidity caused by hydrolysis is called hydrolytic rancidity. Oxidation cares mainly with the unsaturated fatty acids. Oxidative rancidity is off interest because it results in the event of unfavourable off-flavours which will be detected early within the development of rancidity, more so than in the case of hydrolytic rancidity. Oxidation can alter the flavour and nutritional quality of foods and produce toxic compounds, all of which may make the foods less acceptable or unacceptable to consumers. Oxidation products typically include low relative molecular mass compounds that are volatile also as undesirable off-flavour compounds (Food lipids).

2.1. Introduction
The present century is the century of oxidative stress (OS) that linked to several life-threatening disorders which predominantly affect public health as well as their nutritional status. Unhealthy lifestyle and eating pattern which is major concern for OS. The biological literature first used the phrase “oxidative stress (OS)” in 1970. OS can be defined as a state of imbalance condition between the high level of pro-oxidants and the low level of antioxidant scavenging capacity in the body. The normal oxidative process that occurs in cells is crucial for the existence of life and favours the death of a cell. Free radicals, which are unstable, can form when molecular oxygen breaks up into pairs. This unstable radical has a high level of reactivity and produces reactive molecular species like reactive oxygen species (ROS) and reactive nitrogen species (RNS). To resist the OS and to maintain the redox balance, cells have an inbuilt antioxidant defence capacity, comprising of superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPOD) etc. But some pathogenic or environmental conditions may overpower this antioxidant defence system, allowing a portion of reactive oxygen and nitrogen species (RONS) to bypass degradation and create much more reactive radicals. Increased ROS and RNS affect redox balance and damage DNA, proteins, amino acids, and fats, causing alteration of structures as well as action of cells and tissues. This will ultimately produce several pathogenetic elements associated with clinical situations and leads to the development of human aging and numerous diseases. Several dietary components such as whole grains, nuts, fruits, and vegetables are excellent sources of antioxidative vitamins, minerals, nutraceuticals or phytoceuticals that shields the human body from the harmful oxidative injury by scavenging or destruction of free radicals and also by upregulation of endogenous antioxidant defence system. Thereby long-term and sustainable OS remedies can be performed.

ABSTRACT

The food industry has many the environmental challenges in terms of emerging microbial strains, bacteria, viruses and accumulation of toxic chemicals. Ozone (O₃), environmental bluish gas is an extremely potent oxidant, which is effective solution for disinfection, sanitization for various kinds of products. The application of ozone treatment in agro processing has become green technology with increasing acceptance. It can apply in liquid form, gaseous form to sanitize food, food packaging materials, process water and to disinfect equipments. Ozone can be generated by different methods such as ultraviolet radiation method, corona discharge method etc. In this chapter, ozone properties, its generation, antimicrobial power and advantages with application of ozone has covered. Fruits and vegetables treatment with ozone have shown increased shelf-life and many hazardless advantages of the products. Some products preserved with ozone. Anti microbial activity, no residues in foods, assurance about preservation of sensory, nutritional and physicochemical properties of food have made ozone application as a promising technology for all kinds of food products

Pack inspection: It is similar to continuous inspection except that here inspector(s) may make in-process checks during different processing operations under contract but not required to be present all the times in the plant during operation.

Package: The package means a pre packed box, tin, barrel, pouch or can etc in which food article is packed.

Package store: A store that sells bottled or canned alcoholic beverages for consumption off the premises.

Packaging: Packaging is an industrial and marketing technique for containing, protecting, identifying and facilitating the sale and distribution of agricultural, industrial and consumer products (Plate 467). Packaging is defined as an enclosure of products, items or package in a wrapped pouch, bags, box, cup, bottle or any container form to perform one or more of the functions as containment, protection and preservation, communication and utility or performance. Technically, packaging is a system or method by which a product from the manufacturing point to the consumer level reaches in a safe and sound condition at an affordable cost. The primary purpose of the packaging is to protect the food product, to keep it in good condition and to preserve the flavour until it reaches the consumer. It is therefore, very essential that a suitable form of the packaging is chosen for a finished product. Packaging is an art, which determines the buying decision of a consumer. or Wrapping / placement of objects in paper / other packaging materials, keeping in box, etc is known as packaging which has two main functions, to assemble the produce / objects in convenient units for handling and to protect them during transporting, marketing and storage which results in extended shelf life of the produce. “Packaging” play a very important role not only in ensuring safety of the product during transportation, storage and distribution and in conveying information about the pack contents to the consumers, but also ensuring desired sensory characteristics and micro biological soundless till consumed.

Packaging is a tool that is used to contain the product, protect the product from environmental hazards and help in marketing the product. Examples of ideal natural packaging systems are that of a banana, orange, coconut and egg, where the packaging is provided by nature. The major step forward in the food processing arena has been the ability to protect and preserve products with packaging and hence ensuring the availability of fresh and processed products out of season and over long distances in various forms. Milk is a highly perishable product and is not uniformly available round the year to the whole country due to geographical and genetic variations. If dairy products are to be available all the year round the country, irrespective of the season and area, it must be presented in packages that are convenient to purchase and use.

Packaging has additional responsibilities of providing convenience, safety and facilitating, besides handling, storage and distribution of products. It should prevent spoilage of food by microbial or insect attack. It also preserves the quality and nutritive value of many foods by the exclusion of oxygen and the control of moisture loss or gain. It increases the shelf-life and ensures longer availability and contributes to the product image through structural and graphic design. Product information is also given out through the medium of labeling, which acts as a tool for marketing and advertising.

Packaging means a coordinated system of preparation of goods for distribution, storage, merchandizing and shipment at optimum cost compatible with the requirements of the product. It also includes the art, science and technique used, preparatory to and during transportations and selling of goods and technical methods and work processes related to the above preparations.

The broad range of dairy products necessitates that packaging equipment and materials encompass nearly all types from flexible to rigid and from high to low barrier. The general types of packaging and equipment are discussed below with a focus on fluid products but it must be recognized that other dairy products such as cheese have their own particular packaging requirements and technologies.

Role of packaging in distribution and sale: The essence of what makes milk and dairy products important source of human nutrition also causes rapid deterioration and high perishability. The major role of dairy packaging is to retard the deterioration by preventing microbial recontamination and excessive chemical deterioration. Fluid products are especially susceptible to microbial, enzymatic and chemical degradation. In addition to retarding quality loss, packaging must provide containment, facilitate use, identify products, communicate, and appeal to consumers, all with maximum production efficiency. The large volumes and low unit value means that these functions must be met with minimal economic cost and environmental impact. Because food packaging is generally highly regulated, legal requirements must also be understood and met.

Packaging is an integral part of fruit and vegetable processing. It has  major influence on storage life and on marketability of fresh as well as processed products. Packaging fulfills several functions including containment, facilitating transportation, protection of fruit/vegetable from further damage, protection of environment from contents of package (for example, if the contents are dirty), marketing, product advertising, and stock control.

Objectives of packaging and packaging materials

The primary objective or packaging is to protect the contents during storage, transportation and distribution against deterioration. It may be physical, chemical or biological. However, followings are objectives of packaging and packaging materials.

India’s bakery market at 49.5 billion tonnes makes it the third largest market in Asia Pacific, only after Japan and Australia. 72 The bakery industry in India comprises of organized and unorganized sectors. The organized sector consists of large, medium and small-scale manufacturers who produce packaged biscuits and bread. The unorganized sector consists of small bakery units, cottage and household type manufacturing their goods without much packaging and distributing their goods in the surrounding areas. Bread market is estimated to be growing at around 7% p.a. in volume terms, whereas the biscuit market has witnessed a higher growth at around 8–10%. Within the biscuit category, cream and specialty biscuits are growing at a faster rate of 20% p.a. The per-capita consumption of biscuits in India is around 900 gm as compared to 15–20 kg. for developed countries. The consumption of biscuits is equally divided between the urban and rural population. Demand for biscuits in 2003–2004 is likely to exceed 1.2 million tonnes.

The emerging functional foods market presents a considerable challenge to all manufacturers to keep abreast of the use of adequate packaging materials for their products. The interest in functional foods is intrinsically linked to the potential health benefits of their bioactive components. Preserving these bioactive components is, therefore, a crucial factor to providing the anticipated health benefits of functional foods. However, recurring failure in maintaining the quality of functional foods has been reported. Functional foods include a wide variety of products such as prebiotics and probiotics, dried foods (fibers, probiotics, tea, herbs, etc.), fermented products (yogurts, kefirs, vegetables), and fresh fruits and vegetables.

Packaging makes material handling convenient, economical and effortless and modern consumer marketing will seem virtually impossible without packaging. For an engineer or food scientist, packaging is specialized arrangement of matrices fabricated for the delivery of safe food products with maintaining high quality and food safety, at every step of distribution chain including procurement of raw material to manufacturing of finished product; packaging of product; storage; transportation and distribution to wholesaler, retailer and consumer and even for recycling operations [17].

Packaging of food is imperative in a world dominated by marketing-based economy The fact that 73% of purchase decisions are made at point of sale highlighted the importance of a good package design in marketing. During scanning of food package, consumer made quick and rapid perception about the inclusion of a particular food based on the various verbal and nonverbal attributes embodied on food package [25]. Designing is an indispensable are of food packaging. It is medium to attract potential buyers and distinguished the product from the competitors. The presence of visual attributes on package design will not only ameliorates the food product and glamorizes the packets but also defines its authenticity and peculiarity. Therefore, a quality package design is characterized as communication channel between the manufacture and consumer, and unless performed correctly the market image of the brand and product suffers and influence consumer’s perception.

From automated filling and sealing systems to advanced inspection and labeling machines, packaging machinery plays a pivotal role in delivering food products to consumers in optimal condition. India is the second largest producer of fruits However, the export potential of fruits and vegetables is very negligible. This is because of improper knowledge to the farmer about proper post-harvest infrastructure facilities. Fruits have a high-water content ranging from 70-95 per cent. They dry quickly under any normal atmospheric condition. These causes loss of rigidity and shrinkage of the cells cause wilting and shrivelling. Appropriate packaging ensures prolonged the shelf life of fruits and vegetables by preventing moisture loss and thereby wilting. Transportation is a critical phase in the fruit supply chain that can significantly affect the quality of fruits. Several factors during transportation can lead to quality degradation such as temperature/humidity fluctuations, mechanical damage, transit time etc. To mitigate the adverse effects of transportation on fruit quality, best practices ie, real-time monitoring, temperature and humidity control, loading/unloading techniques can be employed. Quality evaluation is a critical component in the fruit industry, encompassing a range of assessments to ensure fruits meet the desired standards for consumer satisfaction, shelf life, regulatory compliance, and market competitiveness. Packaging is an important aspect in modern life and in fact the word ‘packaging’ developed a literal value indicating presentation of an issue or material in a comprehensive and compact manner. Food packaging has become a revolutionary trend and plays a dominant role in the promotion of marketing of various fresh and processed food products. The reason could be a number of aspects inclusive of protective, legal and aesthetic elements. The industrial revolution in the late 18th century caused major impact on manufacturing process. Without appropriate packaging no food is acceptable and even in the common household food packaging is being practiced in its own way to render food safety and convenience for various culinary operations. Therefore, food packaging needs to be considered as an essential element of food processing and marketing and it is one of the key areas in food technology making rapid strides in research and development.

Food packaging is the integral part of the food industry. Packaging may be defined as the enclosure of products, items or packages in a wrapped pouch, bag, box, cup, tray, can, tube, bottle or other container form to perform one or more of the following functions: containment, protection, preservation, communication, utility and performance. If the device or container performs one or more of these functions, it is considered a package. The major roles of the packaging of food are the containment and preservation of foods by protecting the food from physical, chemical and microbial spoilage. Besides, packaging performs some other functions like communication which means giving the information about the product, transportation of the food production and so on. Food products are classified as perishable, semi- perishable and non-perishable food based on the spoilage. Selecting appropriate packaging material and packaging technique for various food products like meat and poultry, fruits and vegetables, milk and milk products, bakery and confectionery and beverages is essential to maintain the quality of food product. Selection of the ideal packaging material for specific food requires prior knowledge about the packaging materials and its properties, type of the food products and specific spoilage mechanism of the particular food. Above all, from economical point of view, packaging material cost and capital for the establishment of the packaging technique also plays crucial role in selection of a particular packaging material or technique. 

Packaging : Packaging of fruits, vegetables, flowers or any other commodity is chiefly done to assemble the produce in convenient units of different sizes, shapes & types for storage, transportation, marketing and distribution. The size of units may vary depending on the requirement e.g for retail marketing smaller units are preferred and for bulk transportation and storage, large units would be more convenient.

Why do we Require Packaging?

Imagine there is no packaging material and technology available. How we are going to transport apple, mango etc. to distant markets? Definitely as loose. Then how can we weigh or count the fruits being transported or marketed? This would be very difficult. Had there been no packaging the commodity would have suffered great physical, chemical and microbiological losses. It would have been very difficult to handle, manage, transport and market the produce as loose and unpacked. Therefore, the packaging of fresh as well as processed commodities was needed to contain, unitize and protect the produce.

Food and nutraceuticals are obtained from various agricultural resources available in this planet. Many types of bio-active compounds are available in small quantities in the plants and animals which are evidenced to improve performance of various organs, increase in immunity and cure for some diseases. Last decade evidences several advancements in developing phytochemical formulations which can be used as a cure for many diseases as well as helps in boosting immunity in human being. Such materials exist in different form, structure and chemical compositions. Examples of such chemicals are phenolic and organosulphur compound (Pascall 2011). The vegetables, fruits and seeds are used without further processing. Some plants are subjected to cooking before its consumption. Many industries are carried out extraction of bioactive compounds and developed products in the form of tablets, powders and liquids which are available in the market. In order to make commercial process more economic and feasible, long term storage of plant residues (Raw materials) as well as the prevention of the extracts emerges as essential requirement for the industries. Moreover, the products requires suitable packaging solution to increase its self-life, preventing it from the influences of environment, and to make viable solution for easy access which makes it more user-friendly. Suitable packaging solution is required for mainly the three reasons: (i) prevention. (ii) protection and (iii) presentation. Prevention is required in-order to avoid deterioration of the packaged items due to microbial growth, loss in moisture and enzymatic action. Protection is required for the purpose of protecting the packaging materials from the contamination as well as from the environment impact and rough handling. Presentation is equally important to provide it an aesthetic look to make it more approachable to the consumers. Moreover, packaging also offers “labelling for easy identification, warnings, instructions, and nutritional information, ease of transportation” (Pascall 2013).

Food packaging is an essential technique for preserving food quality and minimizing food wastage. It is a scientific technique of containing food against physical, chemical and microbiological contaminants. In addition package also display the product in most appropriate manner and provide product information to the consumers while at the same time allowing convenient handling and efficient distribution. The packaging of meat and meat products are particularly important because meat is highly nutritious food and provides good medium for the growth of micro-organisms. Meat and meat products are also susceptible to bacterial growth due to their high water activity. Exposure of meat and meat products on atmospheric temperature and sunlight leads to various types of deteriorative changes. For example when cut meat surfaces exposed to ambient air provide excellent breeding grounds for most bacteria. Minced meat is even more at risk due to the large exposed surface area. Packaging provides protection of food against external and internal factors but once food gets deteriorated it can not be controlled by packaging. For this reason rigorous hygiene in all processing and pre-packaging steps is vital for packaging of perishable food items like meat and meat products.

From the earliest time, man had to conserve and preserve his food, so that surplus at harvest following a successful crop can be stored for use throughout the year. Prime agricultural products in general and more so with fruits and vegetables which are being processed world wide or preserved to a more stable form so that they can withstand transport, handling and storage over a long period. As civilization developed, man learnt to preserve fruit and vegetable products with salt, spices and by drying , smoking or cooling which could extend their shelf life. Later by experience, he learnt that by protecting it from environmental factors such as air, moisture and light, the shelf life of these processed products could be further increased. He tried to keep them dry and covered to protect from insects and rodents. As with solid foods, primitive man experimented with beverages also. It is likely that the first beverage known to him after water was fruit juice. This undoubtedly led to the discovery of wines made from the fermented fruit juices. Later on, preservation methods and development of packaging materials underwent drastic changes.

Product Characteristics and Packaging Requirements:

The key raw materials for sugar confectionery are sugar (60 - 65%), glucose, citric acid and flavoured essences. Confectionery is hygroscopic in nature and requires protection against the ingress of moisture, and exposure to high temperature (as far as possible).

A candy or confectionery product may be adversely affected by many things. Hard candy, brittles and crunch products are most sensitive to moisture and absorb water vapour fairly rapidly from the atmosphere. Various gums are less sensitive while some creams tend to lose moisture considerably.

1. To contain the product: The package should be big enough and built with suitable elements to stop spoiling and leaks. It should be sturdy enough to withstand handling, shipping, and storage difficulties as well as closely matched with the product.
2. To protect the product: Packaging seeks to protect the product from microbiological activity, heat, light, moisture, oxygen, evaporation, etc., therefore preventing contamination, loss, damage, or degradation.
3. To help in selling the product: Easy dispensing, reclosure, disposal, and possible reuse should be made possible by the packaging form, therefore helping the marketability of the product.

Packaging, hardening, storage, and shipping are essential final stages that protect ice cream quality after manufacturing. This chapter explains the role of packaging in protecting products from moisture loss, contamination, physical damage, and environmental exposure. It examines hardening technologies, including rapid-hardening systems, tunnels, spiral systems, and other industrial arrangements. The chapter also discusses bundling, shrink wrapping, palletizing, frozen storage, distribution models, and cold-chain requirements under Indian conditions. Packaging is an important consideration in vegetable and fruit market. The use of properly designed containers for transporting and marketing of vegetables is significantly reduce losses and maintain their freshness succulence and quality for longer period. Packaging also provides protection from mechanical damage and undesirable physiological changes and pathological deterioration during storage, transportation and marketing.

Many vegetables are transported in gunny bags and bamboo baskets. Packaging material such as polythene films, paper boars, and boxes lived with polythene and other materials can effectively prolong the shelf life of vegetables. By using plastic films vegetables can be protected from dry air. Polythene packaging provides modified atmosphere and consequently reduces decay, softening, and loss of solids. The thickness and permeability to CO₂, O₂ and water vapour of films needs to be standardized for each vegetable.

Packaging is the integral part and cornerstone of food processing industry. The development of food processing industry goes hand in hand with advancement of packaging technology. Packaging Institute International has defined packaging as “enclosure of products, items or packages in a wrapped pouch, bag, box, cup, tray, can, tube, bottle or other container form to perform one or more of the following functions: containment, protection, preservation, communication, utility and performance”. Lockhart has defined packaging as “a socio-scientific discipline that operates in society to ensure the delivery of goods to the ultimate consumer of those goods in the best condition intended for their use”. Food packaging technology has came a long way from use of anything in hand for wrapping up a product to becoming a key element in product development and design.

Various systems were developed to take produce from field to consumer and selection of a particular method depends on several factors, including perishability and value of crop.  One method is to harvest the crop and take it to a packhouse for various unit operations like grading, cleaning, post-grading treatments, and packing for transport and marketing. When deciding upon where to locate a packinghouse, access to field and market point, adequate space for vehicles to enter and leave  packinghouse and ease of access to labor will all be considered.
 
In the simplest packinghouse, produce is delivered in picking containers, immediately after harvest, directly to packers.  Packers then sort, grade, size and pack the produce directly into appropriate transport containers. In this case, each worker must be aware of produce defects, grade and size requirements, and packing methods.

This process involves building up a coating of sugar and sometimes of other things, layer by layer. Panning is one of those processes that the confectionery and pharmaceutical industries have in common.

The coating of confectionery with sugar using a pan is very ancient. Originally, these products were made in an open pan suspended over a fire by chains. Apparently the operator swung the pan by hand, coating the product with sugar syrup which was then allowed to crystallise. The normal modern small-scale method is to use a rotating dragee pan (Fig.No.19.1).

These are elliptical vessels made traditionally of copper, but now more commonly of stainless steel. The pan is equipped to be rotated and usually there is a system for supplying and extracting air and possibly with a system for spraying in the sugar syrup. Typical pan sizes are between 1.5 and 0.9 m in diameter although smaller sizes are used for small-scale work.

The papaya (Carica papaya L.) belongs to the family Caricaceae. It is an important fruit of tropical and sub-tropical regions of the world. It is the most important plant in the home gardens, and where green papaya is also used as a vegetable. Ripe fruits are eaten as dessert, which is available throughout the year.

Papaya is native to West Indies and Central America (Mexico). It is a common fruit in nearly all parts of tropical and sub-tropical world. It is abundantly grown in India, Sri Lanka, Bangladesh, South America, Pakistan, Australia, Mexico, Costa Rica, Hawaii, Kenya, Taiwan, Puerto Rica, Peru, USA, Philippines. It was introduced in India in 16^th Century. In India it is mainly cultivated in Kerala, Assam, Bihar Uttar Pradesh, Gujarat, Tamil Nadu and West Bengal.

Cultivars: Honey Dew, Coorg Honey Dew, Washingtan, Pusa Delicious, Pusa Majesty, Pusa Dwarf, Pusa Giant, Co. 1 to Co. 7, Arka Surya, Arka Prabhat, Pusa Nanha, Pink Flesh Sweet, Pant 1, Sunrise Solo and Taiwan Red Lady, are the most popular varieties under cultivation in India.

Paper and paper-based packaging is the traditional form of packaging used for various food products due to its various advantageous characteristics. It is less expensive, flexible, lightweight, durable, recyclable and available in various shapes, sizes and colour to meet customer needs. Hence it occupies a vast market in food packaging from primary (i.e., packaging which is first used after manufacture) to secondary (i.e. processing aids of primary packages) packaging and the production of paper has doubled in the last three decades. In the year 2020, china was the leading producer for paper and paper based packaging followed by USA and Japan (Figure 1).
