Passion fruit, (Passiflora edulis Sims) belongs to the family Passiflora. Within this species, there are two distinct forms, the standard purple, and the yellow, distinguished as P. edulis f. flavicarpa Deg., and differing not only in color but in certain other features. The purple passionfruit is native of southern Brazil. The yellow form was unknown in India until just a few decades ago when it was introduced from Ceylon and proved well adapted to low elevations around Tamil Nadu and Kerala.

Uses

Passionfruit juice can be boiled down to a sirup which is used in making sauce, gelatin desserts, candy, ice cream, sherbet, cake icing, cake filling, meringue or chiffon pie, cold fruit soup, or in cocktails. The seeded pulp is made into jelly or is combined with pineapple or tomato in making jam.

Introduction

Military personnel’s are deployed for operation in adverse climatic conditions like desert, cold (arctic) and high altitude regions. Stressful and challenging living conditions have affected the outcome of many battles, campaigns and wars. Acclimatization to the environmental condition is a very essential stage of deployment. The time for acclimatization is restricted/limited for the effective operation towards the purpose of deployment. The performance of the military personnel in various deployed regions depends on the nutrition provided by the food consumed. The operational rations are designed to provide the essential nutrition to enhance their performance during training and/or operational situations.

Nutrition requirement of military personnel is different from that of the civilians. The nutrition requirement also varies with the kind (sedentary or continuous work) and region (plain, desert or high altitude) of deployment. The environmental stress caused by extreme heat, cold, etc. also influences the nutrient requirement/ intake. The insufficient dietary nutrient intake affects the immune function, pace of recovery from illness and injury and also the physical performance (Tharion et al., 2005).

The operational ration is also designed in such a way that it provides to the military personnel the required nutrition from the build in nutrition reserves during certain operational situations. Considering the vital criteria for nutritional requirement, the menu for the military personnel is designed. The chapter discusses the past, present and future of the army operational ration (AOR) in various countries of the world and the influence of advances in food processing methods in AOR menu.

9.1 Introduction
The term “pasteurisation” is derived from the Frenchman Louis Pasteur, who demonstrated that the preservation of wine was enhanced by heating it to a temperature of 122 to 140 °F, which eradicated spoilage organisms. This occurred between 1860 and 1864. The utilisation of this procedure resulted in the development of a new term, “pasteurisation,” which rapidly acquired popularity in the field of technology. Although Louis Pasteur was a pioneer in the discovery of the use of thermal treatment to preserve wine, the process of pasteurising milk was initially attributed to Dr. Soxhlet of Germany in 1886.

9.2 Heat treatment of milk
In the context of market milk, pasteurisation is currently defined as the process of heating each component of milk to a minimum of 63°C for 30 minutes, 72°C for 15 seconds, or any other temperature and duration that achieves the same level of effectiveness. Equipment that has been certified and functions properly is required for this process. The milk is promptly chilled to a temperature of 5°C or lower after the pasteurisation procedure.

However, because of its perishable nature, it requires immediate processing to improve the shelf life and safe consumption .With the advancement of processing techniques in dairy and food processing, there is a widespread option being utilized to improve the milk shelf life byeither thermal technologies (pasteurization, sterilization, and ultra-high temperature) or nonthermal technologies (high pressure processing, high pressure homogenization, pulse electric field and ultra sonication). Still, pasteurization and sterilization are the two foremost process is used for milk industries. Pasteurization is the thermal inactivation of microorganisms at temperatures below100°C that enhance the safety and quality of milk and milk products and extends the shelf life to an extent. 

Abstract

Issues regarding intellectual property rights and their protection are heralded nowadays in the scientific arena both in developed and developing countries. IPR is being given greater attention and importance due to the projected idea that it is a dependable means through which greater skills and knowledge can be utilised to serve as a reliable resource for the upliftment of the economy as well as knowledge dissemination. In context of microorganisms, India does not allow patenting of microbes whichalready exists in nature assuch but genetically modified version of the same microorganism with enhanced and improved efficacy can be patented. The deposition of microorganisms in a culture collection recognized as an international depository authority (IDA) is necessary if intellectual property rights regarding these microbes are to be claimed. An action plan for developing countries towards creating IDAs and preserving the natural gene pool has been evolved. It is likely that IDAs will transform into ‘biological resource centres’ and further into‘global common genetic resources’, with an internationally agreed legal basis for benefit sharing. This chapter is an effort to highlight the genesis of patenting and legalities of patenting microorganism in India.

Growth of a microorganism implies an increase in amount of protoplasm, formation of new structures and eventually formation of new cells. Balanced growth means cell components increase in proportion to each other and unbalanced growth means cell components increase in a non constant relationship to each other

Lag Phase: When cells are first inoculated into fresh medium containing all the nutrients they require, they take a short time to adapt before they start to divide. This is termed the lag phase.

Abstract

Consumer now-a-days relies on manufacturing and processing standards, particularly to know what ingredients are present, due to dietary, nutritional requirements, or medical conditions (e.g., diabetes orallergies). Modified PCR and combination of PCR with other analytical tools have been successfully used for analysis of various parameters related to functional foods such as detection and quantification of beneficial as well as food borne pathogenic microorganisms, food allergens, raw material source, bioactive compounds, genetically modified foods. Multiplex PCR method has been found to be an efficient tool for simple, rapid, and reliable identification of Lactobacillus and Bifidobacterium in probiotic products. Food allergens like gluten, peanut, hazelnut etc. could be easily detected in foods using PCR, even if present in small quantities. BOX-PCR and PCR-DGGE analysis have been used for identification of bacterial diversity of a naturally fermented functional food (Enzyme). HPLC combined with real time -PCR were successfully used to quantify and analyse compounds of secondary metabolites like phenylpropanoid amides, which represent an important class of nutraceutical having strong antioxidant and chemotherapeutic effects in various transgenic tomato tissues. Detection of active compounds in natural plant products were successfully achieved using PCR techniques. In general PCR have gained more importance as it has high sensitivity, improved precision, wide dynamic range for quantification, genotype based and is quick method of detection and quality control of foods than traditional culture based methods.

The peach tree (Prunus persica L.) is a species of Prunus native to China that bears an edible juicy fruit called a peach. It is a deciduous tree growing to 4–10 m (13–33 ft) tall, belonging to the subfamily Prunoideae of the family Rosaceae. It is classified with the almond in the subgenus Amygdalus within the genus Prunus, distinguished from the other sub genera by the corrugated seed shell. Among the temperate fruit’s peaches require relatively less chilling temperature. Now peach is a commercial crop in Argentina, Austria, Canada, Chile, Europe, USA, China, India and Japan. In India, it grown in hills of Uttar Pradesh, Jammu & Kashmir, Himachal Pradesh, Uttar Pradesh and Punjab.

Cultivars/Varieties: Sun Red, Red, Nectarine, Kateroo, Flordasun, Florda gold, Sharbati, Maygold, Kanto-5, Stark Early Flame, Summerset, Early White Giant, Redglobe, Alexander, First Gold, Early Gold and Sweet Gold.

Uses

Peachs are grown both for dessert and processing purposes. It is also used for making wine. Peach fruit juice is a common drink. Peach kernel has high protein and its oil is used in food, cosmetics and pharmaceutical products. The cake after extraction of oil can be used for various purposes. Peach flowers and leaves are anthelmintic and purgative.

The pear or naspati (Pyrus spp) is a popular temperature fruit next to apples. It ranks high among sub-acid fruits as it contains less acid than almost any other fruit. Pear belongs to the genus Pyrus under the family Rosaceae and sub- family Pomoideae. The European pear (Pyrus communis) with a persistent calyx, fleshy pedicels and pyriform shape is different from Pyrus pyrifolia or Pyrus serotina (Asiatic pears) and are non-fleshy pedicels with apple shape.

It has been used as a food from time immemorial. The pear is a wholesome fruit and at par in importance with the apple. The flesh of the pear is, however, slightly harder than the apple, but it is juicier than the apple. Like the apple, it has few seeds. It grows on a comparatively large tree. It has generally yellow and brown colour. Sometimes, there is also a tint of red. It has several several varieties across the world.

It originated in mountainous reach of western China. The major pear producing countries are Italy, USA, Japan, Spain, France, Germany, Turkey and Australia. In India, it is mainly grown in Jammu & Kashmir, Himachal Pradesh and hills of Uttar Pradesh.

Cultivars: In India, Bartlett is widely grown in Kashmir. Kieffer, a cross between Pyrus communis and Pyrus pyrifolia, is popular in South India. In Punjab, the popular varieties ar Patharnakh, Le Conte, Smith and Kieffer.

1. Introduction Millets, one of the earliest foods consumed by humans, may have been the first cereal grain utilised in domestic cookery. It belongs to the Graminae grass family. The name “millet” describes a number of little-seeded grasses (annual) that are classified into five genera: Setaria, Panicum, Pennisetum, Paspalum, and Echinocloa in the tribe Paniceae, and one genus: Eleusine in the tribe Chlorideae (Pushpavalli, 2015). India ranks first in the production of millets followed by Niger and China (FAO, 2020). Pearl millet (Pennisetum glaucum) serves as food, fuel, and fodder on a global scale. Since, it contributes up to 75% of all grain output in East Africa and several regions of India; it plays a significant role in indigenous diets. After rice and wheat, pearl millet is the third most significant crop farmed in India. Ninety percent of the country’s land is used for cultivating pearl millet, with Rajasthan, Gujarat, Maharashtra, Uttar Pradesh and Haryana being the main states.

1.1 Introduction Pearl millet [Pennisetum glaucum (L.) R. Br.] is a warm-season, C4 , annual cereal crop mainly grown for food, feed and fodder purpose. It is diploid species having chromosome number 2n = 2x = 14, belongs to genus Pennisetum, tribe Paniceae of Gramineae family. It has several species e.g., americanum, typhoides, and glaucum. Pearl millet originated in northern Africa in the region from western Sudan to Senegal. It is the sixth most important cereal crop in the world and third most important crop in India after wheat and rice.1.2 Area and Production Pearl millet is cultivated in arid and semi-arid regions of the world. India is the largest producer of millet in the world. In India, pearl millet occupies 6.93 million ha with an average production of 8.61 million tones and productivity of 1243 kg/ hac. The major pearl millet growing states are Rajasthan, Maharashtra, Gujarat, Uttar Pradesh and Haryana which account for more than 90% of pearl millet acreage of the country and are commonly grown in kharif season. It is also cultivated during the summer season in parts of Gujarat, Rajasthan and Uttar Pradesh and during the rabi season at a small scale in Maharashtra and Gujarat.

1. Introduction

Pectin is a polysaccharide present in the middle lamella of plant cell walls. The firmness and structure of the plant tissue are attributed to the presence of pectin in the middle lamella. The insoluble form of pectin is called protopectin and the soluble form is called soluble pectin (Kertez, 1951). Protopectin is abundant in green fruits and contributes to hardness of cell, where as soluble pectin is responsible for viscous nature of juice and pulp. Conversion of protopectin to soluble pectin results in loosening of the bonds between the cells and softening of the fruit tissues. Protopectin is reported to be hydrolyzed to pectin by enzyme action during ripening. Protopectin on restricted hydrolysis yields pectin or pectinic acid. Braconnot (1825) discovered pectin as the gelatinous principle of fruits.

A white to light brown powder, is a heteropolysaccharide derived from the cell wall of higher terrestrial plants. It is mainly used in food as a gelling agent in jams and jellies. Today it is also used in fillings, sweets, as a stabiliser in fruit juices and milk drinks and as a source of dietary fiber in foods. Pectin is a heterogeneous grouping of acidic structural polysaccharides, found in fruit and vegetables and mainly prepared from ‘waste’ citrus peel and apple pomace. Pectin has a complex structure. Preparations consist of sub-structural entities that depend on their source and extraction methodology. Commercial extraction causes extensive degradation of the neutral sugar-containing side chains.

Pectin was first isolated and described in 1825 by Henri Braconnot, though the action of pectin to make jams and marmalades was known long before. To obtain well set jams from fruits that had little or only poor quality pectin, pectin-rich fruits or their extracts were mixed into the recipe. During industrialization, the makers of fruit preserves soon turned to producers of apple juice to obtain dried apple pomace that was then cooked to extract pectin. Later, in the 1920s and 1930s, factories were built that commercially extracted pectin from dried apple-pomace and later citrus-peel in regions that produced apple juice in both the USA and in Europe. At first pectin was sold as a liquid extract, but nowadays pectin is often used as dried powder that is easier to store and handle than a liquid

Peeling: It is one of the integral parts of a food processing, and most agri-cultural crops need to be peeled to remove at the initial stage of food processing Peeling removes inedible portion (peel, seeds, and stalk) of fruits and vegetables. However, the susceptibility to spoilage increases due to acceleration of physiological process and the exposure of the tissues to microorganisms. The shelf-life and quality of fresh-cu produces could be compromised with the peeling.
The goals of optimum peeling operation are i. Minimizing product losses, ii. Types of products e.g., potato products, iii. Minimizing heat ring formation e.g., apple, potato, iv. Minimizing energy and chemical usage, v. Minimizing the environmental pollution.
Peeling operation can be grouped under following categories: Manual peeling (knife or blade), Mechanical peeling (abrasive devices, devices with drums, rollers, knives or blades and milling cutters), Chemical peeling, Enzymatic peeling, and Thermal peeling (Flame or dry heat peeling, steam or wet heat peeling, thermal blast peeling, and vapour explosion or vacuum peeling.

What is Performance Appraisal?

Performance Appraisal (PA) is the process through which an individual employee’s behaviour and accomplishments for a fixed time period are measured and evaluated. The major purpose of measuring and evaluating is to assess the worth or value of an employee. Performance appraisal is a systematic and objective way of judging the relative worth or ability of an employee in performing his task. Performance appraisal helps to identify those who are performing their assigned tasks well and those who are not and the reasons for such performance.

Irrigated agriculture plays a predominant role in the state’s food grain production. Erratic trend of rainfall, it has been realized that the availability of water will become very less in forthcoming days as a result cultivation of crops will face water crisis. Development of new water resources needs excessive money investment with high level of expertise and technical knowhow. The ground water is also falling down to greater and greater depth due to overdraft causing for the restriction of the construction of tube wells. Further the efficiency of traditional irrigation system in India is now varying from 30% to 40% against 62 to 65% during the project plan periodbecause of wastage of this valuable water resource due to mismanagement. To meet the increasing demand for additional food grain production, the demand for water in the irrigation sector will increase substantially. In such a situation conservation of water and its proper management is necessary for developing a sustainable agricultural system avoiding the degradation of the land quality, water and other natural resources in an irrigated area.

Popularly known as Japanese, or Oriental, persimmon, it is also called kaki (in Spanish, caqui), Chinese plum or, Chinese fig when dried, belongs to the family Ebanaceae. The tree is native to Japan, China, Burma and the Himalayas and Khasi Hills of northeastern India.

Uses

Fully ripe Japanese persimmons are usually eaten out-of-hand or cut in half and served with a spoon. The flesh may be added to salads, blended with ice cream mix or yogurt, used in pancakess, cakes, gingerbread, cookies, gelatin desserts, puddings, mousse, or made into jam or marmalade. The pureed pulp can be blended with cream cheese, orange juice, honey and a pinch of salt to make an unusual dressing.

The compliance with hygienic and aesthetic standards in the dairy factory is, in the final analysis, dependent on the human element. Each employee, from top management to the most junior operative, has his role in the factory sanitation programme and carelessness at any stage may cause quality deterioration of products or endanger the health of consumers. Legal action against the dairy may also result from neglect of hygiene. Personnel hygiene refers to the personal cleanliness and related habits of the workers. Milkborne infections frequently originate from food contaminated by workers through their hands, breath, hair, perspiration, pimples, infected wounds, coughs, and sneezes. Transfer of even traces of human and animal excreta by the workers is a potential source of pathogenic microorganisms. Foodborne illness is known to originate from workers who were ill and practiced unsanitary food handling methods or poor personal hygiene. Even the healthy worker, who does not exhibit the symptoms of the disease, may harbour food poisoning bacteria in the respiratory or intestinal tract. It is always desirable, as a matter of practice, to look at different parts of the human body in terms of potential sources of bacterial contamination. Provisions regarding personal hygiene of employees are contained in all legislation dealing with milk treatment.

In 21 Century with the advancement of science and technology, more particularly, Information and Communication Technology (ICT), it is possible to establish the connectivity on e-mode and do the things on virtual mode to the possible extent. It is quite possible in urban set up with proper infrastructural facilities both at the source as well as at the receiver end, without any distortion of message on account of electricity failure or wrongful handling of computer or any gadget for that matter.

Pesticides are an undeniable part of modern life, used to protect everything from flower gardens to agricultural crops from specific pests. Pesticides have contributed significantly to improving quality of life and safeguarding the environment. Some 20 to 40 percent of the world’s potential crop production is already lost annually because of the effects of weeds, pests and diseases (according to the FAO reports) (www.CropLifeAmerica.mht). In addition to increasing crop yields, crop protection products used in stored products can also prolong the viable life of products, prevent huge post-harvest losses from pests and diseases and protect food safety for eating.

Introduction

The term pesticide refers to any chemical or mixture of chemicals intended for preventing, attracting, repelling, controlling or regulating a pest, including unwanted species of plants and animals during the production, shipment, transit, storage, processing or distribution of any food or agricultural commodity. The term includes compounds classified as insecticides, fungicides, herbicides, accaricides, rodenticides, plant growth regulators, sprouting inhibitors, chemosterilants, desiccants etc. The term excludes substances like animal drugs and food additives. Pesticides are chemicals used to destroy or control weeds, insects or other pests. The term pesticide residue refers to the remnants of the pesticide after weathering and it consists of the parent molecule and the degradation products which are toxicologically significant. In general, the pesticides, by virtue of their inherent toxic nature are recommended to be used as per Good Agricultural Practices (GAP) only. If GAP is not followed, contamination of the produce with the residues may pose significant health risk to consumers, non target organisms, biota and environment as a whole. When a pesticide is used for pest control purposes, they may reside in the form of metabolites.

Pesticide residues occur as the leftover of any pesticide after its application for pest control and it includes the parent compound and its toxic metabolites. Pesticide residue analysis may be defined as qualitative and quantitative analysis of samples drawn from agricultural field, market and environment for pesticides and toxic metabolites. Pesticide residues are invariably present in micro – quantities and generally estimated at ppm/ ppb levels. After application of the diluted spray solution, they are present at sub microgram levels in the substrate and hence their estimation at ppm or ppb levels is very cumbersome and need to be performed with utmost care. Moreover, the residue data generated should be accurate, reliable and reproducible. The level of residue in any edible commodity has to be below their prescribed maximum residue limits (MRL) value for market acceptance and below maximum permissible intake (MPI) for safety to consumers. Pesticide residue data are mainly utilised by regulatory authorities for estimation of MRLs and for assessing impact on human health and environment, particularly their adverse effect on non-target organisms. The detection of the pesticide residues must be confirmed beyond doubt and confirmation by GC-MS/MS or LC-MS/MS is generally acceptable. Since pesticide residues include parent compounds, isomers and toxic metabolites, appropriate methods of detection should be selected so that all the components are measured separately. Environmental samples/ market usually contain residues of large number of pesticides, for which multi residue methods are required for estimation/screening of such samples.

pH is important as a measure of active acidity which influences the flavour and palatability of the product and affects the processing requirements. This is an indicator of the acidity or alkalinity of the solution. It is also taken as the measure of the sourness or tartness of the given sample. The pH of a solution varies from 0 to 14. Solutions having a value of pH ranging from 0 to 7 on the pH scale are termed as acidic and the value of pH ranging from 7 to 14 on the pH scale are known as basic solutions. While, solutions with a pH value equal to 7 on the pH scale are known as neutral solutions. Samples with a pH value equal to 0 are known to be strongly acidic. Further, the acidity decreases as the value of pH increases from 0 to 7 whereas, solutions with the value of pH equal to 14 are termed as strongly basic solutions.
Most fruits have a pH value ranging between 3-4, with citrus fruits exhibiting a pH of up to 2.0. Vegetables may exhibit a pH of up to 6.0, as such they are classified as non-acid or low-acid foods. Based on pH value, most fruits, vegetables, and their products are classified into four arbitrary groups such as low acid (5.3 and higher); medium acid (5.3-4.5), acidic (4.5-3.7), and high acid (3.7 and lower). pH value of some fruits, vegetables, and their products is given as under:

Phalsa belongs to the family Tiliaceae where only one genus, Grewia, yields edible fruit. The only species of any importance is G. subinaequalis DC. (syns. G. asiatica Mast), long referred to in literature as Grewia asiatica L. Phalsa is the most used vernacular name in India, where there are a number of local names. The plant is called falsa in Pakistan. Phalsa is commercially cultivated in India in states of Punjab, Haryana, Rajasthan, Uttar Pradesh and Madhya Pradesh.

Cultivars/Varieties: Two distinct types, viz. Tall and Dwarf were recognized in Hisar and dwarf type was found to be more productive. Some call them as ‘Local’ and ‘Sharbati’.

Uses

The fruits are eaten fresh as dessert, are made into syrup, and extensively employed in the manufacture of soft drinks. The fruit is used in making juice and squash. The bark is used as a soap substitute in Burma. A mucilaginous extract of the bark is useful in clarifying sugar. Fiber extracted from the bark is made into rope. The wood is yellow-white, fine-grained, strong and flexible. It is used for archers’ bows, spear handles, shingles and poles for carrying loads on the shoulders. Stems that are pruned off serve as garden poles and for basket-making.

4.1 Phases of technology transfer
To translate laboratory research into market ready product, it is important to understand steps or phases involved in this technology transfer process. The process typically includes six main phases, each with a different role (figure 9).
4.1.1 Research
Technology transfer begins with research, the critical stage of exploring and discovering novel knowledge, technologies, or innovations that may have potential commercial applications. The research phase can occur in academic institutions, research organizations, or private sector companies, often funded by public or private sources. Thorough research ensures that the technologies being transitioned are scientifically and technically robust, thereby increasing their potential for market success. Therefore, the research phase involves creating and evaluating new ideas, confirming their feasibility, and identifying IP prospects, all of which are key components of TT success.
4.1.2 Innovation disclosure
Innovation disclosure is the first formal step where the innovation is reported to the appropriate TTO or IP management team. This process ensures that the institution or organization recognizes the innovation and evaluates its potential for protection and commercialization. It includes following information:

Introduction Solid–liquid extraction process, has been extensively used for extraction of bioactive compounds from plant food matrices by using appropriate solvent, which can be used as functional ingredients and additives in food processing, pharmaceutical sectors, and others industries. Usually this extraction/recovery process is based on unsteady diffusion of compounds targeted for extraction, through the matrices followed by the dissolution of the extractable compounds in the bulk of the used solvent (Milic, Rajkovic, Stamenkovic, & Veljkovic, 2013). The concentrations of bioactive compounds in food matrices as well as in the extracts are generally low in percent, so extra energies are required to improve the yield of the extraction process while minimizing the overall cost. From the technological approach, extraction process is mainly associated with the operating variables such as solvent used, extraction technique, operating temperature, concentration of solid in solvent, and extraction time, and by optimizing these parameters extraction yield could be enhanced (Milic et al., 2013; Orphanides, Goulas, & Gekas, 2014).

Milk is a complex colloidal dispersion, the physical and physicochemical properties of which depend on intrinsic compositional and structural factors, extrinsic factors such as temperature, and post-milking treatment.

There is no clear dividing line between physical properties and physicochemical properties. However, physical properties may be thought of as the measure of the bulk behaviour of milk and of how milk interacts with energy, while physicochemical properties are measures of how bulk behaviour and energy interactions depend on the constituent colloidal particles, molecules, atoms and ions in milk.

Knowledge of physical properties is of importance particularly in the technological and engineering design and control of milk processes and processing equipment. Knowledge of physicochemical properties provides the basis for the design of modern methods of milk analysis, determination of milk microstructures and elucidation of the complex chemical reactions that occur in milk.

In the dairy industry measurements of the physical properties of milk and milk products are made to secure data necessary for the design of dairy equipment (e.g., heat conductivity and viscosity) to determine the concentration of a component (e.g., specific gravity to estimate solids-not-fat or freezing point to determine added water), or to assess the extent of a physical or chemical change (e.g., titratable acidity to follow bacterial action or viscosity to assess aggregation of protein micelles or fat globules). The great advantage of physical measurements for such purposes is their speed and simplicity as well as their potentialities for automation.

Use of physical property to measure concentrations or changes in degree of dispersion demands knowledge of the contribution of the several components to that property. Furthermore, the natural range of variation of the property in milks or products is of major interest. The precision and suitability of possible methods of measurement are also of prime importance.

Physical Chemistry of Foods

    1.    Thermodynamics is primarily concerned with energy and entropy. Energy, also called internal energy (U), comprises heat and work; it is measured in joules (J).

    2.    Energy may be recalled that work generally equals force times distance (in N_·m = J) and that force equals mass times acceleration (in kg ·m· s^-2 = N).

    3.    According to the first law of thermodynamics, the quantity of energy, i.e., heat (q) work (p) potential energy, is always preserved.

    4.    Entropy (S)  is a measure of disorder; it is given by

        Where K_B is the Boltzmann constant (1.38 ×10^-23 J × K^-1) and W is the number of  ways in which the system can be arranged, also called the number of degrees of freedom.

    5.    Colligative solution properties : The lowering of the chemical potential of a solvent by the presence of a solute causes changes in a number of physical properties: vapor pressure, boiling point, freezing point, osmotic pressure, etc. (the magnitudes of these changes all are proportional to the mole fraction of solute).

In the physical methods of preservation, fruits and vegetables are preserved by (i) adding heat, (ii) removing moisture content of produce to prevent spoilage and (iii) irradiated by Gama rays which kill the microorganisms responsible for spoilage of foods. These methods are described below.

Processing and Preservation by Adding Heat or Heating

In this method, heat treatment is given to destroy the microorganisms which are responsible for spoilage of the produce. Heat treatment is given by many methods.

The primary constituents of milk are water, fat, protein, sugar (lactose), minerals, vitamins, and enzymes. Milk is a thin emulsion made up of two phases: A continuous aqueous colloidal phase and a dispersed phase of oil or fat. It is an opaque white liquid containing fat in an emulsion, protein, and a few minerals in a colloidal suspension, and lactose along with soluble proteins and a few minerals in a true solution. The physical characteristics of milk are comparable to those of water, but they are altered by the degree of dispersion of the colloidal and emulsified components as well as the presence of different solutes, such as salts, lactose, and protein, in the continuous phase.

Physical Appearance, Color and Optical Properties

Fat globules and casein micelles scatter light, giving the appearance of turbid and opaque milk. The way that molecules scatter light has an impact on optical characteristics. When the wavelength of light and the particle’s magnitude coincide, light scattering happens. Consequently, light with shorter wavelengths is scattered by smaller particles and vice versa. Because casein micelles scatter blue light more than red light at shorter wavelengths, skim milk appears slightly blue. Cow’s milk has a creamy color because of beta- carotene, a carotenoid precursor to vitamin A. The greenish tinge in whey is due to the presence of riboflavin. Turbid and opaque due to scattering of light mainly by protein micelles and fat globules.

Snack foods have become an essential part of the diet throughout the World and they are prepared from natural ingredients or components to yield products with specified functional properties. Extrusion cooking technology getting more popularity over other traditional processing technologies because extrusion shows continuous efficient cooking, mixing and forming process.

Physico-chemical and microbiological quality of meat and aquatic food and food products gives its overall safety and quality status as a food. The physico-chemical and microbiological qualities of raw material have great importance on the product development. It also affects the shelf life of the raw material as well as final product.

Fresh meat is a type of meat which has not been subjected to any processing whereas raw meat is a fresh meat which has undergone freezing. The qualities of fresh meat are important as far as merchandiser, purchaser and consumers are concerned and it is also important for adaptability in further processing. The important quality parameters of fresh meat are:

Abstract

Four bread wheat varieties (PBW-138, PBW-299, PBW-343 and PBW-373), two of durum wheat (PDW-215 and PDW-233) and two of triticale (TL-419 and TL-1210) were milled to obtain 70 percent extraction flour.  The grains and the flour samples of all the varieties were evaluated for proximate composition, rheological properties and pretzel making. Physical properties of durum wheat were better followed by bread wheat and triticale. Durum wheat were harder, had higher grain weight than bread wheat and triticale.  Protein, ash, fat, total sugars and enzyme activity were higher in triticale flour than bread and durum wheat flours while durum flour had higher pigments (ppm, b-carotene). Bread wheat flour was intermediate between durum and triticale flours with respect to fineness. Rheological studies revealed triticale flour to be the weakest flour. Pretzels prepared by using optimized recipe and method revealed PBW-343 and PBW-373 best for pretzel making.

Physicochemical parameters of meat
1. Moisture, ash and fat content
• Meat samples are dried at 105 °C for 24 h for determining the moisture content and for ash content analysis, samples are burned at 525 °C
• Fat determination is done by acidic hydrolysis of the sample
• Sample is boiled initially and then cooled and later, it is filtered, washed and dried
• Thereafter, petroleum ether is used to extract the fat
• Ether is evaporated and the remnant is dried and weighed
2. Protein content
• Often, protein in meat sample is estimated using Kjeldahl method
• The protein content is determined by multiplying the nitrogen content in the meat sample by an appropriate conversion factor
• Strong acid is used to digest the meat sample and the released nitrogen is measured by proper titration technique
• Then, the protein quantity of the sample is determined from the nitrogen concentration of the meat
• Kjeldahl method does not determine the protein content in straightway manner; a conversion factor (F) is required to convert the nitrogen content to protein content
• Usually, a conversion factor of 6.25 (corresponding to 0.16 g nitrogen/g of protein) is used for several food samples

The physio-chemical properties of ice cream strongly influence its processing behaviour, texture, stability, and consumer acceptance. This chapter examines ice cream as a complex multiphase system and discusses important properties including overrun, density, viscosity, freezing behaviour, hardness, scoopability, meltdown, and fat destabilization. It explains how formulation and processing conditions influence these properties and how they relate to sensory quality. The chapter also considers quality-control tests used in industrial ice cream plants and identifies defects associated with physio-chemical imbalance. Understanding these relationships enables manufacturers to establish suitable product targets, diagnose quality problems, optimize formulations, and maintain consistency across different ice cream products.

Fruits, the vivid and delightful offerings of the nature, undergo remarkable transformations as they travel from the orchard to our dining tables. These changes indicate the significance of post-harvest physiology, which is the scientific study that reveals the secrets of how fruits behave after they are picked, including the mechanisms that affect fruit quality and how long it may be stored. The next section provides definitions of the various stages and key players involved in the processes of fruit maturity, ripening, and post harvest physiology. These topics will be further explored in the subsequent sub-sections of this chapter.

Fruit developmental physiology

The life cycle of horticultural commodities (fruits and vegetables) can be effectively categorized into three primary physiological stages after fruit set or initiation, namely growth, maturation, and senescence. Still, a lack of obvious differentiation exists among the several stages. Growth encompasses the process of cell division followed by cell enlargement, which determines the ultimate size of the product. Maturation typically begins prior to the cessation of growth and involves various activities across different commodities. The stages of growth and maturity are commonly denoted as the developmental phase. Senescence can be described as the phase in which anabolic biochemical processes transition into catabolic processes, resulting in the ageing and eventual demise of the tissue. Ripening, a term specifically used for fruit, is typically regarded as the initial phase of senescence that occurs during the later phases of development. Defining the transition from growth to senescence is rather straightforward.

Physiological disorders refer to non-parasitic or inanimate disease of fruit crops, or it is the breakdown of tissue that is not caused by either invasion by pathogens or by mechanical damage. They may develop in response to an adverse environment, especially temperature or to a nutritional deficiency during growth and development. Physiological disorder is broadly classified into two broad categories. They are:

The production of fruit crops is largely dependent on the environmental conditions and nutritional status of the plants. Any alteration in the environmental conditions and nutritional status may results in different physiological disorders which affect the growth of the plants and also the quantity as well as quality of the fruits. The precise and early recognition of physiological disorders is important for the timely adaptation of remedial strategies to reduce the crop loss. Physiological disorders in fruits crops may be due to single factors or multiple factors may be involved in the appearance of physiological disorders. A sound knowledge about the cause of physiological disorder is useful to adopt suitable remedy for the disorder.

Introduction

The abnormal growth behavior or unusual external and/or internal conditions of fruits which results due to adverse environmental conditions and nutritional imbalances are considered as physiological disorders. Physiological disorder is best defined as external or internal malfunctioning resulting from improper environmental or cultural conditions before and/or after harvest. Variation from normal temperature, light, moisture, nutrient, harmful gases, insufficient supply of growth regulators, deficiencies or excesses of nutrient etc. are some of the important environmental and cultural factors of physiological disorders (Fig. 1). Physiological disorders affect the quality as well as quantity of the fruit crops. Detection of precise physiological disorders is not easy and requires a strong knowledge regarding them.

Pineapple, are well adapted crops for the farmers towards water economy due to its morphological, anatomical, and physiological characteristics. However, the plant contains rosette leaf structure can able to channels the light rainfalls and dew through stem and finally into the soil. It also have the ability to absorb water and nutrients through their waxy leaves and aerial roots and can capable to store water in specialized aquiferous leaf tissue; multicellular trichomes that cover the leaves and protect the plant from excessive transpiration by reflecting radiation; a thick cuticle covering the leaf epidermis that restricts water loss by evaporation, location of the stomata in furrows at the lower leaf surface where they also are covered by trichomes, limiting evapotranspiration; and its nocturnal carbon dioxide fixation via the crassulacean acid metabolism (CAM) carbon assimilation pathway, which results in stomatal opening primarily at night when evaporative demand is lowest (Reinhardt et al., 2018). The most common propagating material of pineapple is suckers or slips. Suckers are used to arise from the underground parts of the plant are used for propagation. Slips arise from the fruiting stem and the crown region on top of the fruit.

In this context, it is important to know the nutritional aspects of pineapples which are as attractive as their unique anatomy. “Pineapples contain high amounts of vitamin C and manganese,” said San Diego-based nutritionist Laura Flores. These tropical fruits are also important for the dietary fiber and bromelain (an enzyme). “As well as having high amounts of manganese, which is important for antioxidant defenses, pineapples also contain high amounts of thiamin, A, B vitamin that is involved in energy production,” Flores said. Pineapples are fat-free, cholesterol-free and low in sodium (Arpaia et al., 2004; De Costa, 2010). Side by side they contain sugars of about 14 grams per cup (www.livescience.com, 2019). In continuation with this, the chapter was focused on physiological disorder of pineapple caused by various reasons.

Basically, non-pathological conditions are the reasons of physiological disorders of any kind of crop plants; it includes poor light, adverse weather, water-logging, phytotoxic compounds or a lack of nutrients, which affects the normal functioning of the plant system. Sometimes physiological disorders may be initiated before harvest, continue their development after harvest, or appear after harvest. In was observed several times that physiological disorders are causative agent for the deterioration of horticultural commodities which leads to economic losses. An important commercialized fruit i.e., pineapple is also facing the same problem of different kind of physiological disorders; it includes multiple crowns, fruit and crown fasciation, collar of slips, dry fruit and bottle neck, sun-scald/ sunburn, blackheart etc.

Fruit ripening is a phenomena during which horticulture produce undergoes a series of complex physical and biochemical changes initiated through a series of hormones (Ethylene, auxin, abscisic acid (ABA), gibberellins, jasmonic acid, etc.) to attain maximum physiological maturity and favourable organoleptic properties. These changes lead to alterations in colour, texture, aroma, flavour and nutrient composition. In a nut shell, ripening involves increase in pulp to peel ratio, solubilisation of pectic substances, degradation of complex carbohydrates, organic acids and chlorophyll, accumulation sugars, flavour volatiles, polyphenolic compounds and pigments (carotenoids, xanthophylls and anthocynanins). The extent of these changes guide harvesting, readiness for processing and consumption decisions, with physic-chemical alterations serving as indicators of optimum ripeness. Respiration rate, ethylene and ABA are key regulators of fruit ripening in climacteric and non-climacteric fruits, respectively. In climacteric fruits, ABA interacts with ethylene, influencing the synthesis of ethylene itself. Although there is ample documentation on the involvement of hormones in fruit development and ripening, our understanding of the functions of various hormones throughout growth, maturation, and specific ripening processes remains incomplete.

Abstract

Upcoming era of functional foods has led food scientists and food processors to deeply understand the role of phytochemicals in promoting human health. Phytochemicals are the secondary metabolites produced by plants and are commonly found in our daily food. Natural food products seem to be good substitute for pharmaceutical supplements to improve health status of people. Therefore, consumer's interest is growing in the food items naturally containing phytochemicals, each having there own functional and health aspects. Most discussed phytochemicals in the present paper are carotenoids such as lycopene, beta-carotene, lutein and, polyphenols such as phenolic acids, flavonoids, anthocyanins and isoflavones. Major dietary source for carotenoids include orange and yellow fruits and vegetables as well as green leafy vegetables whereas polyphenols are found abundantly in green tea, wine, berries, cocoa, broccoli. Carotenoids can also be used as colorants in foods during processing. The role of polyphenols as an antioxidant is well characterized because of there ability to scavenge free radicals or bind pro-oxidant metal ions by means of their hydroxyl group. Carotenoids also play an important role in protection against photooxidative processes by acting as singlet molecular oxygen as well as peroxyl radical scavengers, thus acting as potent antioxidant. Apart from antioxidative properties multitude of health benefits are associated with carotenoids and polyphenols such as reduced risk of age-related macular degeneration, certain cancers such as prostate, lung and colon, prevention of cardiovascular disease and enhancing immunity towards infection. Hence, continuous developments are being made to combine phytochemicals to avoid improper combinations that may nullify the effect of supplements and cause lower absorbance.

11.1 Introduction

Phytosterols or plant sterols are bioactive plant constituents having similar chemical structure and biological functions as cholesterol (cholest-5-en-3b-ol), but differ in their side chain configuration. They are non-nutritive compounds with chemical structure differing from that of cholesterol only by minor modifications like in the structure of their side chain by a methyl or ethyl group at C-24. Sitosterol and campesterol have an ethyl and a methyl group at C-24, respectively (Fig. 11.1). Phytosterols present a tetracyclic ring and side chains linked to C-17 that differ according to sterol compound same as cholesterol, to which they resemble structurally as well as biosynthetically. Saturated form of sterols referred to as stands, occurring in small amounts, mainly in cereals are represented by the absence of the double bond at the D5 position. Phytosterols represent a part of the broad group of isoprenoides and are 28- and 29-carbon atom steroid alcohols naturally occurring in plants. Phytosterols and phytostanols are triterpene compounds, found ubiquitously in plants which can only be synthesized by plants, whereas humans and animals obtain them from their diet.

The preservation of food in common salt or in vinegar is known as pickling. It is one of the most ancient methods of preserving fruits and vegetables. Pickles are good appetizers and add to the palatability of a meal. They stimulate the flow of gastric juice and thus help in digestion. They are prepared with salt, vinegar, oil or with a mixture of salt, oil, spices and vinegar.

Pickles known to be good appetizers, aid digestion and pallate are edible products preserved and flavoured in a solution of common salt and vinegar. Spices and oil may also be added. There are a number of pickles very popular in India i.e. mango pickle, cauliflower pickle, lime and lemon pickles, ginger chilli pickle etc. But, some pickles like Sauerkraut are not very common in India but are very popular in European countries.

1. Introduction

At present there is an increasing demand for colourants from natural sources. Since there is a possibility of banning of synthetic colours in view of their carcinogenic properties and already a reduction in number of permitted synthetic colours from 13 to 8 numbers in our legislation (PFA, 2005), the demand for natural colours is evident. In Japan and European countries because of the green movement, the demand for synthetic colours has been reduced. Synthetic colours in global market account for 400 million dollars. Despite processing limitations and higher costs, the global market for natural colours is estimated to be more than 939 million dollars (Espszezola, 1998). Color is recognized as a major factor affecting food acceptance. The consumer expects a specific food to possess a well defined colour and rejects any appreciable deviation from the normal. The change in colour during the preparation of food is a useful guide to quality control and is used by many food processors as the criterion for selecting raw materials. The characteristic colour of raw food is due to the natural pigments present in the plant and animal material. These can be enhanced in processed food products through the addition of food colourants. Addition of colour can make up for the colour losses during processing. Some of the major groups of colours are anthocyanins, carotenoids, betalains, chlorophylls, flavones and chalcones. Some of the plant sources of pigments are kokum, roscelle, chilli, marigold, beetroot, grapes and safflower. Sources of natural colours can be plants, animals or microbes. Fruits and vegetables form one of the main plant sources of pigments. Some of the plant materials rich in colours viz., alfalfa, marigold, safflower, strawberry, aronia fruits, grapes, red cherries have been exploited for pigment extraction and the results have shown positive effects. Some of the interesting features of the work carried out by researchers in this area are presented in the following sections.
