Botanical Description: The plant is a large tree and grows upto 30-40m. in height. The trunk may have a circumference of 1.7 m at the base. The leaves are palmate, leathery, gray green and 1-3 m in wide with folded along at the midrib. Flowers are 90-150 cm long and branched. Fruits are ovoid, 15-20 cm in diameter with fibrous and fleshy mesocarp.

Botanical Description: The plant is a climbing herb with angular stem and long tuberous root. The leaves are classified as palmately simple with five lobes while the shape varies from the heart to pentagon form. The size of the leaves is approximately 5-10 cm in width and length. The tendrils are long, elastic with coil-like springy character that can wrap around the host to the entire length. The flower is large and white about 4 cm in diameter and contains five long tubular petals. The fruit is oblong, narrowed apically or at both ends. The raw fruit is green in color and turns bright red when ripened. The seeds of the plant are oblong and compressed.

Botanical Description: The plant is an procumbent annual climber growing to 1.5m. The leaves are oval to kidney shaped with five to seven shallow lobes. Plants produce trailing vines and yellow flowers similar to cucumbers, but flowers may be male, female, or perfect. Fruit is spherical or ovoid, large, and can reach the size of a football, although it is generally more flattened. It is striped green or pale green in colour, ultimately turning yellow.

Botanical Description: The plant is a moderate sized evergreen tree growing up to 15m tall. The leaves are deep green in colour, oblong to lanceolate and 15-36 cm in long. The flowers are white, large, up to 5 inches across. The fruit is rounded, 5-12 cm in diameter aggregate of 15 carpels with each carpel containing 5 seeds embedded in the pulp.

Botanical description: The plant is a vigorous, perennial, climbing plant, producing annual stems up to 15 metres long from a very large tuberous rootstock. Tubers of the plant are one to several, polymorphic, variously branched or lobed and hairy with small rootlets. The stems scramble over the ground, or twine into the surrounding vegetation. The stem is quadrangular, winged, and twines right-handed. Leaves are opposite, 7-18 x 4-10 cm, broadly ovate, base cordate with acuminate apex. Flowers are laxly arranged, sessile with 1-1.5 mm long and ovate bracts and fleshy tepals.

Botanical description: Aerial yam is a glabrous-leafed, non-spiny, perennial climbing plant producing annual stems up to 10 metres long from a woody, tuberous rootstock. These stems scramble over the ground, or twine into the surrounding vegetation. The stems twine left-handed and produce aerial axillary bulbils. The plant produces tubers; however the bulbils which grow at the base of its leaves are more important food products. They are about the size of potatoes (hence the name air potato) weighing from 0.5 to 2 kg. The flowers are whitish or pinkish in colour.

Botanical Description: The plant is an evergreen tree with a spreading crown. It can grow up to 37 m tall, with a trunk girth of 2 m. The bark is black, smooth, and the inner bark turns bluish on exposure to sunlight. Leaves are oblong and glossy. The male flowers are formed in 3-5 flowered cymes in leaf axils. Female flowers are solitary. Fruits are round, up to 3.5 cm in diameter, yellow when ripe with a juicy pulp.

Botanical Description: The plant is a medium-sized tree growing up to 25 m, height and 1.9 m girth. The bark is black in colour, peeling in rectangular scales, which is an identifying feature. The leaves are eliptic-oblong, opposite or alternate, leathery, up to 35 cm long, velvety on both sides when young, becoming smooth above when fully grown. Male flowers are mauve in colour, sessile or nearly sessile in short peduncles, mostly 3-flowered. Female flowers mauve, mostly extra-axillary or sometimes solitary, axillary, opposite to each other, larger than the male flowers. Fruits olive green in colour, ovoid or globose 3-4 cm across, 1-8 seeded berries. Seeds are compressed, oblong and shiny.

Botanical Description: The tree is very large, growing up to 30 m tall, with many aerial roots that develop in to new trunks, so that the tree goes on spreading laterally. Indefinitely a single tree can cover a very wide area. The leaves are leathery, entire, ovate or elliptic, which grow up to 20-30 cm long with prominent lateral veins. The fruits are 1 to 2 cm in diameter, rounded in shape, without stalks arranged in pairs at leaf axils and it changes to bright red colour when ripens. The plant flowers round the year and bears fruits during April-June.

Botanical Description: The plant is an erect, slow-growing tree with a few upward-reaching branches. The bark is ridged, fissured and scaly with sharp spines. The leaves are alternate, 3 to 5 in long, dark-green in colour, leathery, often minutely toothed, blunt or notched at the apex, are dotted with oil glands and slightly lemon-scented when crushed. Flowers are greenish or reddish in colour, 1/2in across, are borne in small, loose, terminal or lateral panicles. The tree is mostly known for its hard woody fruit, size of a tennis ball, round to oval in shape. The pulp is brown, odorous, resinous, acid or sweetish, with numerous small, white seeds scattered through it.

Botanical Description: The plant is a large or moderate-sized tree, smooth and brown bark with pubescent or tomentose branchlets. The leaves are clustered near the ends of the branches, elliptic, oblong or ovate and acuminate. The flowers are cream coloured, fleshy, on rusty tomentose pedicel and clustered at the end of the usually leafless branches. The fruits are fleshy, green berries, quite large and containing from one to four shiny, brown seeds.

Botanical description: Banana is a tropical small size tree, with large leaves which overlapping bases from the trunk. The leaves are oblong and 1.2-1.5 m in length. Botanical Description: The plant is a small deciduous tree reaching about 25-30 ft in height. Leaves are compound, 14-25 inches long, crowded at the ends of the branches leaflets 2-3.5 inches long, alternately arranged along the rachis, ovate or obliquely ovate, acute with rounded or wedge-shaped base. Flowers are very minute, in short dense spike-like clusters arising from nodules along the branches. Botanical Description: The plant is a small to medium sized deciduous tree, reaching 8 to 18 m in height. It is known for its edible fruits of the same name. The flowers are small, greenish-yellow or pinkish, having six segments, but no real petals. Botanical Description: The plant is a large, nearly evergreen perennial tree that grows up to 20 m or more in height. It has a broad crown, up to 30 m across, and a short trunk, up to 1 m thick. Leaves are deciduous but foliage is persistent, as the new leaves appear while the old ones are being shed, so that the tree looks like an evergreen. Flowers yellowish-white in colour and are borne in small spherical glomerules of about 1 cm in diameter, forming short axillary panicles of 5-30 cm in length. Pods are greenish-brown to red or pinkish, rather thin with 10-15 cm long with irregular shape and flattened. There are about 10 seeds per pod, shining black in a white pulpy aril.

Botanical description: The plant is an evergreen tropical tree, 50 to 100 ft. tall, with oblong opposite leaves that are smooth, glossy and having a terpentine smell. It has fragrant white flowers in branched clusters at stem tips and purplish-black oval edible berries. The leaves are antibacterial, and are used for strengthning the teeth and gums. The fruit is ellipsoid or oblong, variable in size and shape, usually up to 2.5 cm long, black, shining and juicy when fully ripe. Seeds always one, with thick rounded fleshy cotyledons, closely appressed on their inner faces.

Botanical description: The water chestnut is an annual aquatic herb with a rosette of floating leaves and submerged, anchored into the mud by very fine roots. It has two types of leaves, finely divided, feather-like submerged leaves borne along the length of the stem, and undivided floating leaves borne in a rosette at the water’s surface. The floating leaves have saw-tooth edges and are ovoid or triangular in shape, 2-3 cm long, on inflated leaf-stalks 5-9 cm long, which provide added buoyancy for the leafy portion. Flowers are white in colour, with Four petals and are borne for a long period. The fruit is a nut with barbed spines. Seeds can remain viable up to 12 years, although most germinate within the first two years.

Botanical Description: Jackal Jujube is a very thorny straggling shrub with rusty-velvety young branches with paired thorns. Thorns are, one straight and the other recurved. Alternately arranged simple leaves are ovate to ovatelancelike, often oblique, with three prominent nerves and numerous transverse nervules. Tiny green flowers are borne in nearly stalkless velvety cymes in leaf axils. Fruits are spherical or obovoid drupes, black, shining, seeds woody.

Fruits have been one of the earliest foods of mankind. Ancient Indian texts like Charak Samhita and Sushruta Samhita, religious books and puranas are replete with mention of various kinds of fruits. The mango is believed to have been grown for more than 4000 years. Mention of apple, the forbidden fruit, in the Holy Bible is well known. The date-palm is recorded as the fruit crop grown by mankind since 7000 BC. The first book in the world on fruit culture is said to have been the one written on litchi in 1056 AD. In the earlier period of human civilization, fruits served both as food and medicine. Fruits, nuts and tubers were the staples for early wanderers and gatherers. The settled agriculture made mankind more dependent on cereals, pulses and oilseeds for staples and fruits, vegetables and nuts became more a medicine than food.

Many evolutionary and anthropological changes occurred in course of time with changing food habits. At every stage of major change, food habits determined the life expectancy. After completing a full cycle or helix, time has returned to focus on fruits and vegetables again as food, from a stand point of health and wellbeing. From being trees of wild and forests in earlier period, fruit crops became confined to palaces and orchards of Kings in medieval period. In modern Era, it came to stay as commercial commodities dictating the terms of trade. Due to its growing commercial importance the governments across the globe focused to expand the area under fruit crops and cross border trade in several fruits and vegetables. Horticulture research started prioritizing the traits in fruits that determine the economics of trade. In line with these developments, Indian government assigned great significance to horticultural crops since 8^th five-year plan period, and the allocation for horticultural research was increased to `110.2 crores from `31.96 crores in the previous plan. During the 10^th five-year plan period in 2005-06, the National Horticulture Mission was started. As the net outcome of these efforts, the area under fruit crops increased from 2.87 million ha in 1991-92 to 6.48 million ha in 2016-17. The production increased from 28.63 million tonnes to 92.85 million tonnes and productivity from 9.96 tonnes/ha to 14.33 tonnes/ha during the same period (Anon, 2017).

Out of the total value of output of agricultural crops, fruits and vegetables contribute the lion’s share of 23%. The major fruit crops producing states are Andhra Pradesh, Maharashtra, Uttar Pradesh, Gujarat, Madhya Pradesh, Karnataka, Tamil Nadu, Bihar, West Bengal and Chattisgarh. The major fruit crops grown are banana, mango, citrus fruits (sweet orange, mandarin, lime & lemons), peach, guava, papaya, pomegranate, sapota, apple, pineapple, ber, litchi, avocado, etc. Several minor crops like jackfruit, aonla, bael, jamun, custard apple, fig, karonda, phalsa, carambola, etc., are also grown. Some exotic fruit crops like dragon fruit, kiwi, durian, Malayan apple, rambutan, etc., are also getting imported either due to its extra ordinary taste or exotic flavor.

Cherimoya is considered as the most esteemed of the fruits of the genus Annona (family Annonaceae). A. cherimola Mill., because of its limited distribution, has acquired few colloquial names, and most are merely local variations in spelling, such as chirimoya, cherimolia, chirimolla, cherimolier, cherimoyer. The cherimoya is believed to be indigenous to the interandean valleys of Ecuador, Colombia and Bolivia. It is cultivated in Australia, Hawai, Brazil, Mexico, India, Sri Lanka, Jamaica, Spain, Costa Rica, Africa and Argentina. In India it is found growing in states of Maharashtra, Tamil Nadu, (Nilgiris and Palani hills), Karnataka (the Nandi hills) and Andhra Pradesh (Telangana region).

It bears fruits with skin which is thin or thick, may be smooth with fingerprint-like markings or covered with conical or rounded protuberances. The sweet, juicy, white flesh is melting, subacid and very fragrant. The fruit is of a primitive form with spirally arranged carpels, resembling a raspberry. Each segment of flesh surrounds a single hard black bean-like seed.

Cultivars: Fingerprinted, Smooth, Tuberculate, Mammilate and Umbonate are the cultivars having different shapes, texture and morphology.

Uses

The flesh of the ripe cherimoya is most commonly eaten out of-hand or scooped with a spoon from the cut open fruit. It really needs no embellishment but some people in Mexico like to add a few drops of lime juice. Occasionally it is added to fruit salads or used for making sherbet or ice cream. Colombians strain out the juice, add a slice of lemon and dilute with ice-water to make a refreshing soft drink. The fruit has been fermented to produce an alcoholic beverage (Morton, 1987). In Jamaica, the dried flowers have been used as flavoring for snuff. All species of Annona can produce seed oil. Essential oils extracted from soursop (pulp) have industrial applications and the oils are also thought to improve the flavour of processed fruit products.

Vegetables are important accompaniments for the main course of meal, which is by and large a carbohydrate-based food (wheat, rice or millets). It not only makes the meal more palatable, but also wholesome with its diverse color, smell and taste. More importantly it facilitates the easy movement of food through the bowel, better absorption by the body and till the elimination. Besides hunger satiation, it helps to maintain the health by providing the essential micronutrients and prevent lifestyle disorders.

As a nutritious food, it provides the vitamins, minerals and phyto-chemicals which are required in small quantities for physiological processes and metabolic activities. They are cheap sources of beta-carotene, vitamin-B complex, folic acid, vitamin C, vitamin E, etc. They are rich in minerals like iron, calcium, magnesium, phosphorus, etc., and dietary fibres. It has now been proved that minerals are better absorbed by the body in presence of several other factors of plant matrix, than as mineral supplements. It also provides small amounts of carbohydrates and proteins. Vegetables are important as protective foods as their consumption prevents many diseases. They are important sources of antioxidants and phytochemicals. Each vegetable has been found to have certain specific phyto-chemical which besides being a free radical scavenger, is also inhibitor of certain conditions responsible for disease development.

Among the vegetables, tubers like cassava, potato and sweet potato being highly rich in carbohydrates, served as staples for several countries for very long time, in the history. For the same reason, there are a variety of food products based on these tubers. Others like carrot, radish, beetroot, and turnip in root vegetables, onion and garlic among bulbous crops; tomato, brinjal (egg plant), okra and capsicum among fruit vegetables serve as sources of phytochemicals (carotenoids, anthcyanins, lycopene, betalain, capsicum, bassiniloids, etc.). Beans, peas, cowpea, and other leguminous vegetables are important sources of proteins and leafy vegetables (greens) contribute to the much-needed minerals, vitamins and fibre (roughages) in the diet. Allicin and diallyl disulphide found in onion and garlic control blood cholesterol besides being anti-bacterial. The diphenylamine in onion is effective against diabetes. The ‘Charantin’ found in bitter gourd have hypoglycaemic activity. Diosgenin in yams are used for manufacture of contraceptive drugs. Cole crops like cabbage, cauliflower, Brussel sprouts and sprouting broccoli have anti-carcinogenic properties mainly due to hydrolysed glucosinolate derived isothiocynates and indoles. Similarly, health benefits and curative properties of many indigenous and exotic vegetables have been mentioned in several classical texts of India and China.

The human body consists of trillions of cells and to be healthy it needs variety of foods and nutrients. The food around the globe includes a variety of spices which have many health benefits. It has been found that spices and vegetables in the diet are very important for living healthy. The traditional foods, nuts, seeds, wild fruits and vegetables which are used in the diet are grown in specific areas. Traditional food system plays a significant role towards maintaining the well-being and the health of people in any specific region.

According to Indian Philosophy (Bhat, 2012) the physical body is called Annamaya Kosha.A body, when well nourished grows well by absorbing the energies from the food consumed. Fasting is another aspect of traditional food system. It is meant to purify the mind and the body.

We all eat food because it provides the nutrients that are needed for the various functions of the body. Energy is required for growth and repair of tissues, to maintain body temperature and for physical activity. Energy comes from foods which are rich in carbohydrates, proteins and fat. This provides energy to the body from other nutrients and helps to keep the skin and nervous system healthy. They help towards the various biological activity in the human body. These nutrients are grouped into carbohydrates, proteins, lipids (fat), water, vitamins and minerals. These are used for growth, maintenance, repair and other needs of the body. Protective foods are which contain adequate amounts of vitamins, minerals and high-quality proteins which protect against the development of a deficiency disease. There are various chemical reactions taking place within each cell of a living organism. These provide energy for vital processes and for synthesizing new organic materials. This process is known as Metabolism. Living organisms get energy from the environment and use it for movement, growth, development and reproduction.

PRACTICAL 1: PREPARATION OF READY-TO-COOK MUSHROOM PASTA

Pasta is a product originally made from wheat and is of different shapes and sizes. It is generally rich in carbohydrate but is deficient in protein especially amino acid balance. Therefore, addition of spices and dried vegetables may solve this problem. Moreover, fortification of pasta with tomato, garlic, mushroom or spinach makes it nutritious for consumption. Since instant foods are widely becoming popular and consumed throughout the world and is also a fast growing sector of the noodle industry because of busy life schedule of people.

EXPERIMENT: MINIMAL PROCESSING OF CAULIFLOWER (FREEZING PRESERVATION AND STEEPING PRESERVATION)

Materials and reagents

Material : Fresh cauliflower, glass jars, polythene pouches

Reagents: 15% sodium chloride

These hydrolysates are dried conversion products available in a powdered form. Up to 20 DE they are normally referred to as malto-dextrins or hydrolised cereal solids. Above 20 DE they are more commonly termed spray dried glucose syrup solids.

Applications

Spray dried hydrolysates find application in a wide range of processed and convenience foods. Principally as filler/carrier and sweetness reducer.

They are ideally suited for blending into powdered formulations, and serve the following purposes.

As filler/carrier, they can

(1) Reduce loss of volume in contents on storage or in transit;

(2) Absorb fats and oils to retain free-flowing properties;

These products were originally flavoured with the herb marshmallow but a modem marshmallow is a foam that has been stabilised by a gelling agent. The traditional material for marshmallows is egg albumen which acts both as a foaming and gelling agent - this gives light, soft gel. Gelatine is now more commonly used, and once again can act as both a whipping and gelling agent. A gelatine marshmallow is soft and rubbery but heavier than an egg albumen one. Further gelling agents, e.g., pectin, agar and starch all give a soft, short textured gel. These gelling agents have the advantage of being vegetable products but have the disadvantage of normally needing a whipping agent as well. Enzyme-modified soya products have also recently become available for this use.

Methods of Marshmallow Manufacturing:

There are many bacteria and fungi which produce biofilms. These are made up of living, reproducing microorganisms. These microbes form communities and adhere tightly to the surfaces and are resistant to many antibiotics. Many pathogenic microorganisms form biofilms which are difficult to be removed and are harmful.Such microbial colonies produce an extracellular polymeric substance (EPS) to protect them. The dental plaque was the first documented evidence of microbial biofilms. When such microorganisms get a moist environment they attach themselves to any object and reproduce forming an attachment by secreting a slimy, glue-like substance. It is possible with metals, plastics, natural materials, medical implants, kitchen counters, contact lenses, walls of a hot tub or swimming pool. Initially it was the investigation of many scientists to show the presence of biofilms

Beneficial effects of biofilms have also been shown (Rosche et al., 2009) especially in agriculture (Bogino et al., 2013; Berlanga and Guerrero, 2016) where it can be utilized as a biological control agents. They are used as biofertilizers to enhance crop production (Timmusk et al., 2017), hazardous pollutants can be removed (Irankhah et al., 2019). 

Biofilms are resistant to antibiotics even at high concentrations (Costerton et al., 1999).This could happen when the diffusion of the antibiotic within the biofilm matrix is inefficient and results in slow growth rate of biofilm cells (Davey et al., 2000), there could be the presence of persistent cells and antibiotic-resistant small-colonies (Hogan and Kolter, 2002; Kolenbrander, 2000).Studies have proved that antibiotics can inhibit biofilm formation. An antibiotic azithromycin, is known to inhibit Pseudomonas aeruginosa biofilm. Biofilm colonies become resistant at higher concentrations of the antibiotics whereas at low concentrations these can be induced (Mah and OToole, 2001). P.aeruginosa is commonly present in the lungs of patients infested with cystic fibrosis. The clinical isolates show resistance to azithromycin (MIC>64 pg/ ml).However, low doses of azithromycin have shown improvement in lung function in patients with cystic fibrosis (Borriello et al., 2004). If antibiotics are given at low concentrations (below the MIC) than it induces biofilm formation in a variety of bacterial species. Sub-MIC concentrations of tobramycin can induce biofilm formation in P. aeruginosa. The use of antibiotics in agriculture, as growth promoters have shown to expose bacteria to low levels of the drugs and has caused havoc (Smith et al., 2002). Acinetobacter baumannii is an opportunistic pathogen giving rise to nosocomial infections causing threat to public health. Studies of biofilm-forming genes was done in A. baumannii isolates by PCR technique. To study the relationships of genes a technique based on PCR sequences along with multilocus sequence typing (MLST) were utilized (Saeed et al., 2020). Goudarzi, Mehdi et al. (2019) studied the genetic diversity and biofilm formation analysis of Staphylococcus aureus causing urinary tract infections in Tehran, Iran. The biofilm forming and adhesion encoding genes were studied along with distribution of different agr and spa types in S. aureus isolates by PCR screening and multiplex PCR. The workers found that the ability to produce biofilm was higher among MRSA strains as compared to MSSA strains. The most prevalent biofilm forming gene was icaD (77.3%), followed by icaA (76%), icaB (57.3%) and icaC (50.7%). Acinetobacter baumannii is a nosocomial pathogen which is commonly present in hospitals and is a causal organism of many diseases. A. baumannii isolates have been known as multidrug-resistant (MDR). For controlling such serious organism only molecular techniques have been found to be effective. 

With recent work it has become clear that bacterial societies are very complex. Gene expression in bacterial communities are heterogenous. The heterogeneous gene expression contributes towards the biofilms in fluctuating environments which needs to be understood.Technique like single-cell analysis can help in the investigation of more complex communities. Recently, Jahid and Ha, (2012) have written a review on microbial biofilms of produce and the future challenges to food safety many outbreaks have been observed involving food- borne pathogens. Therefore, there is an urdent need for the safety of foods especially against microbial attacks and biofilm formation as they cause a risk to public health. Medically, the pathogenic microorganisms form biofilm- associated with the epithelial or endothelial lining which are embedded in the lungs, intestinal or vaginal mucus layer, the teeth or other medical implant surfaces or formed intracellularly (Dewasthale et al., 2018). Teichoic acids are characteristic major components of the cell surface in Gram-positive bacteria.

Introduction

Biofortification is the development of nutrient dense staple food crops using the best conventional breeding practices and modern biotechnology, without sacrificing agronomic performance and important consumer preferred trait (Nestel et al., 2006). It provides a comparatively cost-effective, sustainable, and long- term means of delivering more micronutrients (Saltzman et al. 2014). This approach not only will lower the number of severely malnourished people who require treatment by complementary interventions but also will help them maintain improved nutritional status. Moreover, biofortification provides a feasible means of reaching malnourished rural populations who may have limited access to commercially marketed fortified foods and supplements. Micronutrient malnutrition (MNM) is the major constrain to provide nutritional security to world population of underdeveloped and developing countries. Among the 20 major risk factors of the global burden of disease estimates, Fe deficiency ranks 9th and Zn deficiency ranks 11th, while in the high mortality countries, including India, they rank 6th and 5th, respectively (WHO 2002).
