Food packaging is one of the most dynamic and fast-growing industries in the current scenario of increasing industrialization. With the constant upsurge in the food wastage at different stages of processing (suchas harvest, storage, processing, transportation, and distribution) leads to more than 15% of food produced ending up in the dumping grounds due to food spoilage caused by climatic conditions andmicroorganisms.Ever-increasing demands of consumers for convenient food makes packaging technology a need of the hour in order to keep the food safe, wholesome and of high quality at the same time.

So appropriate packaging has the potential of not only preventing spoilage but also taking care of healthand well-being of the individuals.Therefore, packaging plays the most important role in the overall safety of the food product.This makes packaging as the ever-evolving field since new requirements need new materials which demands new approaches and technology for better quality products.

By definition, Food packaging is a well-organized system of protecting the food product from any kind of physical, chemical, and biological damage in order to ensure that food reaches the consumer in its most safe condition at minimum applicable cost. It is bridge between production and consumption (Paine, 1992).

National Dietary Guidelines

Recommended dietary allowance (RDA) is defined as “the nutrient present in the diet which satisfies the daily requirement of nearly all individuals in a population”.

Release agents are used to grease equipment used for manufacturing certain types of sugar confectionery for easy removal of the sweet.

High-viscosity, purified mineral oil is most commonly used material suitable for all sweet manufacturing purposes. Mineral oil is neutral in taste and has little odour. It should be used carefully: there is a legal limit of 0 2% in the United Kingdom.

Acetylated mono-glycerides have excellent release properties. A number of alternatives based on vegetable oil are available, but the development of rancidity on the film surface on the sweets during storage is the major difficulty in the use of vegetable oil

Introduction

Food safety and quality are the prime concerns in a global food supply chain. With the globalisation and advancement in the technologies, the global agricultural system transformed to a stage where food standards and international trade work hand-in-hand to promote food safety. The key drivers for this change in food regulations include digital technologies, novel food processing technologies, product labelling, marketing trends, e-commerce, etc. International trade in food sector is governed by the agreement on the application of Sanitary and PhytoSanitary Measures (SPS) and Technical Barriers to Trade (TBT). The agreements allow member nations to impose all measures or standards to protect human, animal, plant life and health, harmonize with the international standards, environmental protection, protection of consumers against deceptive practices and prevention of unjustifiable barriers to international trade.

In general, the developing countries have negligible contribution in the international trade. There are instances where the quality attributes of the commodities do not meet the required parameters as envisaged by the international market. Various issues associated with the product rejection on the basis of food safety and health standards are a matter of concern today rather than before. Hence, United Nations FAO and WTO urged the active involvement of the developing countries in the food standard setting processes in Codex Alimentarius as well as in SPS and TBT Committees. This will ensure harmonisation of food quality standards and traceability for rapid response to food borne disease outbreaks. Governments and local authorities shall intervene in the market place in setting technical regulations; and sanitary and phytosanitary measures which in turn will encourage the food processing companies around the world to implement food safety management systems to ensure the production and distribution of safe foods.

The financial and commercial book keeping that is generally practiced by dairies, the main purpose of which is to ascertain the total results of the business during a given period, does not answer the question whether the costs of processing of milk products and of the various operations involved in manufacturing, are reasonable. For this purpose, dairy plants have to keep detailed records of the expenditure incurred on different components and processes, for planning of production and controlling of costs. In large multi-product dairy plants, production is generally characterized by mixed and joint production and the different operating operations are interrelated. Thus, it becomes difficult to draw a distinction and allocate and apportion the consumption of various services and utilities to arrive at the cost of different operations of various products.
The Bureau of Indian Standards has developed three different sets of records on dairy accounts which may be used to record different information for cost and quality control. These records are:

Abstract

Three-point bend test (three point bend ring-HDP/3PB) for five types (Good day, Butter bite, Marie, Krack Jack and Salted) of commercial biscuit brands (Britannia, Supreme, Parle, Lancer, Priya Gold and Dalmia) was developed using TA-XT2, texture analyzer and probable factors affecting the results were assessed. Maximum force to break the biscuits, number of fracture before break, thickness of biscuits and percent break point penetration were found in the range of 1006.5 to 3456.5g, up to 3, 4.2 to 6.3mm and 5.54 to 22.62%. The rupture of biscuits were observed on the basis of probe penetration into the biscuits and found that maximum resistance for penetration offered by Marie whereas minimum by salted biscuits, which was respectively the hard dough and fermented dough biscuit varieties. The analysis of variance for the results revealed that there is significant difference (P£0.01) in the maximum force of break for the biscuit types and brands individually or in combination. Difference in the thickness of biscuits was also found significant among types and commercial brands. The number of fractures was not consistent among the types as well as biscuit brands before reaching the maximum force of breaking the biscuit.

Breeding of Heifers

    ·    Regardless of age, puberty is reached when a heifer weighs approximately 40% of her mature body weight.
 
    ·    Breeding however, is recommended when a heifer has reached 60% of her expected mature body weight. This is normally achieved when the heifer is 14 to 16 months old.
 
    ·    Smaller breeds may be bred one or two months earlier than large breeds because they mature faster.
 
    ·    Heifers in good condition and gaining weight at breeding time generally show more definite signs of estrus and have improved conception rates over heifers in poor condition and/or losing weight.
 
    ·    Over-conditioned or fat heifers have been reported to require more services per conception than heifers of normal size and weight.

Pineapple is a monocarpic perennial herb. Each stem flowers only once and dies after fruiting, similar to bananas, before a side shoot takes over. After the pineapple plant reaches a certain size, natural inflorescence initiation (flowering) occurs in response to decreasing day length and temperature (Bartholomew, 2003). Flowering of Smooth Cayenne pineapples grown under an 8-hour day length was encouraged by a night temperature of 20°C, whereas f lowering was delayed by temperatures of 15 and 20°C, and totally inhibited by 30°C.Flower initiation usually starts in November and lasts through the winter. Flowering in nature is highly irregular, and some plants can fail to produce fruit. Thus, growth regulators such as ethylene (25-50 ppm) and NAA (25 ppm) are used in industrial practise to force plants to bloom. The numerous radish-purple sessile flowers are spirally arranged on the axis, each with a pointed bract. To explain the emergence of developing inflorescence, this stage is also known as the red bud stage. The spike-like inflorescence contains 100 to 200 florets. The petals are white at the base and bluish-purple above the calyx at anthesis. They are ligulae form in shape, about 1.6 cm long and 5 mm wide, and are about 1.6 cm long and 5 mm wide (Collins, 1960).The outer f lower petals are very close together, allowing only small insects to reach the f lower; they have 14 to 20 locules, resulting in a capacity of 6000 to 7000 seeds per 150 floret fruit. After pollination, fruits with 2000 to 3000 seeds are not uncommon (Collins, 1960).

Research methodology gives detailed justification about the research methods and procedures carried out in the present study. The present study focuses on the women’s involvement in the dairy farming and their empowerment. Keeping in view the specific objectives of the study and various aspects relating to these objectives the methodological framework has been formulated. The sub topic under the research methodology is as follow:

3.1 Locale of the study

The present study entitled “Retrospective Multidimensional Study on Magnitude of Participation of Women in Dairy Farming in East district of Sikkim” was carried out in the villages of East district of Sikkim. Sikkim is the second smallest states in India, with an area of 7,096 sq. km in size. The meaning of Sikkim is “The valley of rice”. It lies between 27 º33' 00" N and 88 º30' 00" E. The average annual temperature of the state is 18 ºC (64 ºF) and annual rainfall is 2739 mm. The state is situated in the Eastern Himalayas and it shares its border with countries like Tibet, Nepal and Bhutan. Mt Kanchendzonga (8585m) which is the third highest peak in the world is situated at Sikkim. According to 2011 census, population of state was 610,577 with male population of 323,070 and female population of 287,507. The literacy rate in the state is 81.40 percent. The density of the state is 86 people per km2 (Census,2011). The cattle population in the state was 264,860 in number (BAHS,2019). The state has four district- East, West, North, and South (Registrar General of India, 1989).

Several fruits and vegetables are unexploited for proper utilization and product development. Due to lack of utilization, there is a lot of wastage and ultimately the great loss to the people as well as nation. Some unexploited fruits and vegetables have potential for introducing new products. Therefore unexploited fruits and vegetables have to be exploited for new product development especially from underutilized sub-tropical and tropical fruits and vegetables. Research and development should be undertaken to utilize these fruits and vegetables.

Unexploited Fruits

Unripe Green Mango: Although pickles are prepared but droped green mango fruits are not preferred for pickle preparation. They can be dried and utilized for preparation of dried slices or amchur. Amchur is used to develop flavor and taste in Ice cream. These products are used to develop flavor and taste in meal or food. It is also used to prepare chatney. But utilization of Amchur is not known to common people.

Avocado: It is found in tropical and sub-tropical climatic regions having more humidity and rainfall. In Ethiopia it is found throughout the country but not utilized properly by people. They prefer to eat ripe fruits with salt and lime juice. It is very healthy fruit for chronic disease like cardiac and diabeted diseases. This is seasonal use but no product is available for off season. Therefore researches should be carried out for different products development of Avocado products.

Research and development plays a central role in innovation, product improvement, cost optimization, and competitiveness in the ice cream industry. This chapter explains the distinction between research, development, and new product development and examines the responsibilities of an R&D department. It covers formulation development, pilot and plant trials, ingredient evaluation, shelf-life studies, regulatory considerations, supplier collaboration, product costing, and commercialization. It is a most deteriorating biological process of the harvested fruits and vegetables that leads to the oxidative breakdown of the complex material (carbohydrates or acids) of cell into simpler molecules (CO₂ & water) with production of energy. Respiration includes glycolysis metabolism, aerobic metabolism, anaerobic metabolism, trycarboxilic acid cycle and electron transport metabolism processes.

India is situated north of the equator between 8°4' and 37°6' north latitude and 68°7' and 97°25' east longitude, is the largest peninsular country in the world bordered by Arabian Sea in the west, Indian Ocean in the south and the Bay of Bengal in the east. India has a coastline of 8118 km and 0.5 million t sq. km continental shelf endowed with 2.02 million sq. km of Exclusive Economic Zone (EEZ). It has a catchable annual fisheries potential yield of 4.41 million occupying third rank in world marine fish production (Table 1). India’s territorial waters extend into the sea to a distance of 12 nautical miles from the coast baseline. The vital details on marine capture fisheries of India are given in table

This chapter presents the analysis, interpretation and discussion of the collected data from the study area in an effort to attain the objective of the study. The data collected were analyzed with appropriate statistical test and presented in a systematic format.

The results of the study are presented under the following subheadings:

4.1 Distribution of respondents according to different socio-economic variables

Basic information of the respondents under the study has been given according to the socio-economic characteristic of the respondents. Variables like age, education, marital status, family size, family type, milk production per day, social status, farming experience, herd size, land holding and annual income are presented in the following table 4.1

1.1 Introduction
The rural economy has greatly benefited from dairy farming. In rural India, milk has become a substantial source of revenue. Dairy products, including milk, are vital components of modern diets. India holds the title of being the greatest milk producer and consumer globally. Together with native cattle, crossbred cattle, and water buffalo, it also has the biggest dairy herd. Since 2000, there has been a steady and substantial annual growth rate of 4.2 percent in both milk production and consumption. Additionally, second, respectively, in terms of population (GoI, 2014). It accounts for around 25% of the global bovine population. India has emerged as the leading global producer of milk, with a remarkable production of over 155.5 million tonnes during the 2015- 16 period. This translates to a per capita availability of 337 grammes per day, according to the Government of India (GoI, 2017). Dairy farming serves as a primary means of subsistence for more than 100 million individuals. A significant percentage of small-scale livestock keepers lack access to land, and the prevalence of rural landless households is expected to rise due to the continued subdivision of land holdings. Livestock are increasingly vital for the income of smallholder and landless farmers. These initiatives have positively impacted the farmers’ food production, nutrition security, and household income. Additionally, they have played a crucial role in creating employment opportunities in rural areas.

In spite of big potential of the largest livestock population in the world, meat industry in India is still in nascent stage. It is a business of those who are not trained and very much literate. The industry is primarily based on the raw material that is not reared for meat purpose but serves the secondary role after passing their viable life in primary field. The industry is also facing problem of social prejudice and meat is taboo for certain communities. But scenario is now changing and people are coming forward to organise the sector. Now the society is accepting the facts that meat is an only source of cheap and nutritious food to million of people in India and the good source of animal protein for large segment of Indian population, particularly landless, small and marginal farmers.

India ranks fifth in the world meat production with the annual meat production of about 6.3 million tones which is 2.21% percent of world meat production. In the last two decades meat industry in India has grown @ 4.5% whereas, during the last five years, this segment has been growing very fast at the rate of 27% annually. It has a good future if given proper attention by the Government and Private Entrepreneurs. In total meat production, share of cattle is 17.34%, buffalo 23.3%, sheep 4.6%, goat 9.4%, pigs 5.3%, poultry 36.6% and others 3.4%. The share of various meat types in total Indian meat production accounts buffalo meat 1.5 million tones, beef 1.28 million tones, mutton 0.24 million tones, chevon 0.53 million tones, pork 0.50 million tones, chicken meat 2.20 million tones and duck meat 0.07 million tones. To produce the above quantities, the extraction or slaughter rates in cattle are about 7.9%, buffaloes 11.1%, sheep 47.9%, goat 37.9%, pigs 88.9% and poultry 73.6%. In the world total meat production Indian cattle meat shares 13.1%, buffalo meat 55.8%, mutton 5.7% and chevon 14.9%. However, India is having world’s 15.0% (210 million) cattle, 57.0 %( 111 million) buffaloes, 7.0 %( 74 million) sheep, 17.0 %( 154 million) goat and 1.5% pigs. Overall contribution of meat sector in total output of Livestock sector was Rs 25984 crores in the year 2004-2005.

Research being a continuous process for a scientific study, previous study provides basis for the research. The review of literature is necessary for developing conceptual frame work and suitable design for the study. It assists the researcher to keep his work going in right direction. The available literature related to the present study has been reviewed under the following heading:

2.1 Differential role accomplished by women dairy farmers from different social strata

Toppo et al. (2004) examined the participation of women farmers in dairy occupation in Anand district of Gujarat and their result revealed that 18.34 percent of the farm women were mostly engaged in activities related to artificial insemination, majority of the respondent (68.34%) participated in cleaning of the shed, while 25.00 percent of the farm women practised manure preparation and 95.00 percent of the respondent were not involved in preparation of gobar gas mixture.

Badole (2006) reported that majority of the responded had low socio-economic status.

Millets are essential grains that help developing nations in Asia and Africa’s semi-arid tropics, particularly India, Nigeria, and Niger, achieve food and nutrition security.They are grown on soils that are usually too weak for any other crop to grow. They can withstand drought, minimal fertiliser treatment, and temperature swings better than other cereal crops, and their short growing season makes them exceptional. Millets are all-season crops that can be grown all year and provide several security benefits (food, feed, health, nutrition, livelihood, and the environment), making them the most cost-effective agricultural security crop. Sorghum (Great millet), Bajra (Pearl millet), small millets such as Korra (Foxtail millet), Ragi (Finger millet), Kodo millet, Proso millet, Little millet and Barnyard millet are all important millet crops grown in India.

Introduction

Food processing comprise of techniques employed to transform raw ingredients into final food product or to preserve the food product. Food processing industry as well as at domestic scale the food processing methods aim at providing processed food products for daily consumption by humans and animals. Food processing aims at increasing the shelf life, preserve, make nutritious or ready to eat foods, and getting the best quality final products. There are various techniques and methods which come under food processing such as drying, dehydration, fermentation, pickling, freezing, mixing, pumping, pasteurization, cooking and homogenization etc.

Rheological properties of foods are greatly influenced by various unit operations and processing methods or conditions such as heating and mechanical treatments. Processing of different food products such as dairy, fruit and vegetable products like jams and purees, chocolates, dough development etc. and basic make up of foods such as fats, proteins and others such as emulsifiers, hydrocolloids etc. affects the rheological properties of food product and which ultimately affects the quality of end product. Apart from processing conditions the compositional variations have a great impact on the textural or rheological properties of foods. The changes in rheological characteristics of a food product reflects the alterations in the molecular structure of the food material, this can aid in revealing the changes in product structure during different processing methods or conditions. In designing of various processes such as cooling, freezing and equipment design information about thermal properties is crucial. Moreover, in order to design storage structures for foods and refrigeration equipment the knowledge of thermal properties is important (Becker et al. 2003).

For rheological measurements various tests and techniques are available, such as steady and dynamic shear measurements. From the steady shear properties flow properties of the sample can be revealed whether the flow is Newtonian or Non Newtonian. In case of dynamic shear rheological properties information on viscoelastic characteristics can be withdrawn in terms of storage and loss modulus and depending on the predominance of each modulus the nature of sample can be predicted i.e. whether viscoelastic solid or viscoelastic fluid (Bhardwaj et al. 2019). Apart from these measurements, other rheological measurements are available for specific food materials, such as farinograph, alveo-consistograph, mixograph etc. are meant for study of rheological properties of dough. So, accordingly, depending upon the food material choice of rheological measurement can be made. To study the thermal transitions DSC (Differential scanning calorimeter) and DTA (Differential thermal analysis) are commonly employed. Dynamic measurements as a function of temperature or time are made in these techniques to detect the endothermal and exothermal changes. These techniques can be used to determine the phase transitions in various foods, for instance, crystallization and melting of water, lipids and other food components; denaturation of protein; gelatinization of starch and others (Roos 2015).

1. Introduction

Celiac disease (CD) is an immune-mediated enteropathy triggered by the ingestion of gluten in genetically susceptible individuals. Gluten is the protein component in wheat, rye and barley. In the last 10 years, cutting edge scientific developments in this disease have led to the formulation of new concepts of epidemiology, pathophysiology and clinical manifestations. At present, the only available treatment for CD is a strict gluten-free diet (GFD) (Mulder et al., 2013; Theethira and Kelly, 2014). Until recently, the geographical distribution of CD was mostly restricted to Europe and other developed countries, such as the United States, Canada and Australia. Celiac disease is not only frequent in developed countries, but it is increasingly found in areas of the developing world, such as North Africa (Malekzadeh et al., 2005), Middle East (Rostami et al., 2004) and India (Basu et al., 2014, Deora et al., 2014; Yachha and Poddar, 2007). New epidemiological studies have brought evidence that this disorder is common in many developing countries as well, showing that the ‘global village of celiac disease’ has indeed a worldwide distribution (Fasano and Catassi, 2001).

The only available treatment for celiac disease is the strict, lifelong avoidance of gluten. When gluten is removed from the diet, the small intestine will start to heal and overall health should improve (Fasano and Catassi, 2001). Traditional substitutes for gluten-containing grains have been rice, tapioca, corn, and potato. However, more nutrient-dense grains, seeds, nut flours, and legumes are being incorporated into the diet to provide an enhanced palatability, variety, and nutritional quality. These include sorghum, millet, teff, quinoa, amaranth, flax seed, and buckwheat.

Ripe

This word is derived from Saxon word ‘Ripi’, which means gather or reap. This is the condition of maximum edible quality attained by the fruit following harvest. Only fruit which becomes mature before harvest can become ripe.

Ripening

Ripening involves a series of changes occurring during early stages of senescence of fruits in which structure and composition of unripe fruit is so altered that it becomes acceptable to eat. Ripening is a complex physiological process resulting in softening, colouring, sweetening and increases in aroma compounds so that ripening fruits are ready to eat or process. The associated physiological or biochemical changes are increased rate of respiration and ethylene production, loss of chlorophyll and continued expansion of cells and conversion of complex metabolities into simple molecules.

A healthy life is ensured by having access to safe, nutritious and balanced food. World health organisation (WHO) ensures its contribution in developing food safety systems that are sustainable to reduce health risks from farm to consumer. Thus, safe food, its quality and consumer protection are the priorities of this organisation (FAO and WHO, 2021)

Introduction

Biological, physical, chemical and other hazards associated with food have been detailed in Chapter 4. This chapter would address the risks associated with these hazards as well the scientific approach is assessing them. Risk analysis is an inevitable platform for food safety assurance which measures the impact of hazards on the health of consumers. To improve public health and maintain consumer trust in the food supply and to provide a sound regulatory foundation for national and international trade in food, an efficient food safety management system is essential. Therefore, World Trade Organization (WTO) developed food regulations governing international trade in foods based on science and risk assessment. A sound knowledge of food hazards and risks they pose to consumers, along with the capacity to take appropriate interventions, deserve top priority of a responsible authority and industry.

Risk

The word ‘risk’ is used to describe a situation that involves a possibility of something undesired to happen (Rowe, 1977). In food processing, hazards are considered as risks. Hazards are often thought of as synonyms of risks, however, hazards are quite different from risks.

A food borne hazard is defined by Codex as “a biological, chemical or physical agent in or condition of food, with the potential to cause an adverse health effect”. A risk is the chance, low or high, that any hazard will actually cause harm. Some of the emerging food hazards that must be assessed and managed are listed in table 1. Assessment and management of risks posed by these hazards is the responsibility to be urgently addressed by the scientific community.

Introduction

The risk assessment is gaining importance as the scientifically-based approach for the development of food safety and quality standards. It is a logical extension of HACCP revolution. In hazard analysis, first the hazards likely to occur in foods are identified, then an assessment is made of the severity of each hazard, and an evaluation is done of its likelihood to occur. Severity and likelihood are the two factors involved in risk assessment. Second, the increase in international trade has raised new safety and quality challenges. New approaches address the risk of cross-border transmission of infectious and hazardous agents with emerging food-borne diseases and quality problems. This has led to the development of a new safety and quality regulatory framework in 1995, the Sanitary and Phytosanitary (SPS) and the Technical Barriers to Trade (TBT) Agreements of the World Trade Organization (WTO). In these two Agreements, two provisions are of importance to fish safety and quality:

• National SPS and quality requirements should reflect standards agreed on in the international standards setting bodies i.e. Codex Alimentarius for food quality and safety.

• Domestic standards can be developed based on scientific risk assessment.

Risk assessment of microbiological hazards is identified as a priority area by the Codex Alimentarius Commission (CAC). In 1999, the Codex Committee on Food Hygiene (CCFH) in the 32nd session, identified a list of 21 pathogen commodity combinations that require expert risk assessment advice. FAO and WHO jointly launched a programme with the objective to provide an expert advice on risk assessment of microbiological hazards in foods to their member countries and to the CAC. Under which, expert groups are established to examine four priority pathogens: product pairings, e.g. Listeria monocytogenes in ready-to-eat food; Salmonella in eggs and broiler chickens; Campylobacter spp. in broiler chickens; and Vibrio spp. in seafoods. Risk assessment is therefore important throughout all aspects of the seafood industry - for companies, national governments and for international regulators.

9.1 Introduction

Food quality and safety are central issues in food economics today. A number of developed countries (EU, UK, US) has imposed a number of new regulations to track food products across the supply chain which is forcing the companies to invest in new automated approaches for their implementations. These solutions facilitate better process efficiency with more productivity, quality control in production lines, lower manufacturing costs with higher profit margins, and also help to achieve improved presentation as customers request. The high labour costs in developed countries make cost-cutting inevitable to remain competitive production. The growth in products packaged for the market, the increasingly strict hygiene regulations, the need to reduce risks at work, cut costs, and control product quality are all calling for the development of technologies that enable robots to be used for these tasks. In fact, robotics has a great opportunity in this industry. But the variation in physical properties of various food products and the necessity to avoid damaging them, make it necessary to seek flexible handling solutions for a wide range of products.

The robotics industry is looking into a bright future. As per the report given by the Statistical Department of International Federation of Robotics (IFR), it was projected that between 2014 and 2016 worldwide robot sales will increase by about 6% on average per year. Ten years ago, global sales figures were hovering around 80,000. So, three key factors for the boom - factory modernization, increases in production capacity and rising demand from a number of emerging markets.

Calcium, anti-oxidants and certain enzymes are reported to play vital role in extending the shelf-life of harvested produce of many horticultural crops especially fruits. They help in maintenance of cell wall structure. Being an important constituent of cell wall, in the form of calcium pectate, it helps in maintenance of cell wall structure. Antioxidants are highly beneficial in extending the shelf-life of fruits besides maintaining the quality. Similarly, some enzymes play a key role in preserving the fruit quality and prolonging its market life. As some fruits are catergorized under ‘Low volume high value fruits’, it is essential to extend their shel-flife for reducing the post-harvest losses of fruits and also to reap better remuneration. Thus, it becomes indispensable to review the role of Ca, anti-oxidants and enzymes which are beneficial in keeping the harvested produce afresh for a relatively longer period.

Abstract

Research has demonstrated that nutrition plays a crucial role in the prevention of chronic diseases as most of them can be related to diet. Functional food enters the concept of considering food not only necessary for living but also as a source of mental and physical well-being contributing to the prevention and reduction of risk factors for several diseases or enhancing certain physiological functions. One of the most clear objectives of the study of functional foods is to identify and validate biological markers in order to understand the interaction mechanisms between the food component and a body function. Epidemiologic and laboratory data from previous studies suggests that diets rich in fruits and vegetables are associated with a reduced risk of various types of cancers. The reduction in cancer risk may be attributed to the abundance of a family of specific compounds referred to as anthocyanins, which are found in various berries. Anthocyanins are water soluble pigments responsible for the blue, purple, and red color in many plant tissues Strawberry is one of “super fruits”, since they can form a significant component of the diet and are a potential resource of functional foods and nutraceuticals due to their antioxidant capacity and nutritional quality. Strawberries contain high levels of anthocyanins and they are also well liked by consumers. Popularity of strawberries in the consumer market makes them an ideal focus for chemoprevention studies. Strawberries are a rich source of phytochemicals (anthocyanins, catechins, the flavonols quercetin and kaempferol, and ellagic acid) and an important source of essential nutrients (ascorbic acid, potassium, folic acid, carotenoids, B-vitamins). Strawberries are consistently ranked among the top food sources of polyphenols and antioxidant capacity; the preventive and therapeutic health benefits of strawberries may be attributed to the synergistic effects of these bioactives and the nutrients contained in the fruit. These bioactive photochemical contribute the major health-promoting function. Strawberries have shown a remarkably high scavenging activity toward chemically generated radicals, thus making them effective in inhibiting oxidation of human low-density lipoproteins. Antioxidant activity of strawberries could contribute to the prevention of cancer, cardiovascular and other chronic diseases. Hence strawberry can be used as a vital and indispensible functional ingredient for the development offunctional foods and nutraceuticals.

INTRODUCTION

Mizoram is a hilly terrain lying in the north eastern part of the country. The total geographical area of the state is 21, 087 sq. km and lies between 92º 15/ to 93º 29/ E longitude and 21º 58/ to 24º 35/ N latitude. Out of six agro climatic zones of the NEH region, Mizoram comes under sub tropical hill zone and posses a sub tropical and humid climate due to high rainfall (Fig. 1). These climatic conditions are very conducive for the cultivation of a large number of agri-horticultural crops. The physiography of the state is divided into hills and valley lands. About 90 % area of the state comes under hills and only 10 % area is under valley. The valley lands are sporadically distributed in small patches except in Champhai district. The slope of the hills in Mizoram is much steep as compared to the other states in the North Eastern region. The land use statistics of the state is presented in Table1.

Biofilms are resistant to antibiotics even at high concentrations (Costerton et al., 1999).This could happen when the diffusion of the antibiotic within the biofilm matrix is inefficient and results in slow growth rate of biofilm cells (Davey et al., 2000), there could be the presence of persistent cells and antibiotic-resistant small-colonies (Hogan and Kolter, 2002; Kolenbrander, 2000).Studies have proved that antibiotics can inhibit biofilm formation. An antibiotic azithromycin, is known to inhibit Pseudomonas aeruginosa biofilm. Biofilm colonies become resistant at higher concentrations of the antibiotics whereas at low concentrations these can be induced (Mah and OToole, 2001). P.aeruginosa is commonly present in the lungs of patients infested with cystic fibrosis. The clinical isolates show resistance to azithromycin (MIC>64 pg/ ml).However, low doses of azithromycin have shown improvement in lung function in patients with cystic fibrosis (Borriello et al., 2004). If antibiotics are given at low concentrations (below the MIC) than it induces biofilm formation in a variety of bacterial species. Sub-MIC concentrations of tobramycin can induce biofilm formation in P. aeruginosa. The use of antibiotics in agriculture, as growth promoters have shown to expose bacteria to low levels of the drugs and has caused havoc (Smith et al., 2002). Rachid et al. 

Jay et al., (1995) and Joerger et al., (2003) have written the role of bacteriocins as an alternate to antibiotics. Bacteria produce bacteriocins which are proteinaceous in nature or peptidic toxins. These inhibit the growth of similar or closely related bacterial strain(s). There are different types of bacteriocins which are classified based on the producing strain, common resistance mechanisms and mechanism of killing. Ahmad et al., (2013) have isolated antifungal compound for food preservation. Martin et al., (2018) and Batish et al., (1997) found antibacterial compounds from fungus. Mahboubi et al., (2019) studied the potential of Zataria in IBS. There are bacteriocins from gram-positive bacteria known as the colicins, the microcins and the bacteriocins from Archaea (Cascales et al., 2007). The bacteriocins from E. coli are called colicins (formerly called ‘colicines,’ meaning ‘coli killers’). These have been studied widely. Earlier called colicin V and is now known as microcin V. It is very small and is produced and secreted in a different manner than the classic colicins. Adrienne et al., (2016) have studied the colicin resistance.

The applications of enzymes are awe inspiring marvels of nature. Scientists can use enzymes to explore all aspects of biology; from molecules to cells to tissues to organs to organism as a whole. For the purpose of food and drinks, enzymes have been exploited by men for thousands of years without really knowing what they are and how do they work? Enzymes have played a pivotal role in many aspects of life since the dawn of life. Today, biocatalysis is being used as a useful alternative to chemical process technology. The fact that enzymes work under much milder conditions oftemperature, pressure and acidity, thus, obviate harsh processing conditions and thereby decrease the possibility of damage to heat labile substrates and save energy. Enzyme technology being eco-friendly can be justifiably termed as‘Green technology’. Due to their high specificity and high catalytic rate, enzymes prevent wastage and reduce time of processing / manufacturing, respectively. The ability of enzymes to act on wide variety of substrates has made them useful tools to exploit cheaper starting material in food industry. Reportedly, over 45% of the enzymes produced are being used in food industry and remaining is shared by detergent (34.4%), textile (11%), leather (2.8%) paper and pulp (1.2%) and other industries (5.6%). Enzymes serve a myriad of functions in food processing, from maximizing juice extraction of pectin-rich fruits to extending shelf-life in baked goods through slowing starch retro-gradation. Indian food processing industry has seen significant growth and changes over the past few years. Though, the market of enzymes is increasing at a fast pace but most of the enzymes of the food sector are coming from overseas. Seeing the unparallel role of enzymes in food processing sector as in multifaceted domains, the researchers should emphasize upon finding novel enzymes and explore their untapped commercial benefits using modern techniques of enzyme engineering, immobilization and biotechnological interventions.

Abstract

Meat is considered to be a highly perishable food commodity because of its biological composition. Thus, to extend its shelf life and maintain its nutritive value, there is an urgent need to find out alternatives for synthetic anti-microbial and anti-oxidants. This will not only serve the purpose of meat product manufacturer’s but will also satisfy the consumers’ demand for minimally processed meat products devoid of synthetic preservatives. This review discusses the natural antimicrobial and anti- oxidants sources viz., various essential oils, their composition and application in different meat and meat products. Essential oils from basil, rosemary, thyme, oregano, ginger, basilica, balm, coriander, rosemary and clove have exhibited a better potential to be used as an antimicrobial agent in meat and meat products. They owe their anti-microbial properties to the phenolic compounds present in them. They dislocate cell membrane and disrupt functionality of bacterial cell membrane and eventually leading to the release of intracellular components. However, essential oils are not widely used due to the pungent and intense aroma imparted to the food, thus there is still need to work out on the novel technologies which can not only increase food shelf life but at the same time, are sensorially acceptable to the consumers.

Introduction

Fermentation has been an integral part of food processing throughout the history of mankind. In beginning, it was mainly preservation method, then it became key process in substantial sensory characteristic development and now it is utilized to improve overall properties of outcome from major industries like bakery, dairy, beverages, etc. The human understanding of controlled fermentation process changes its fundamental objective by exploring its success in development of rheological and texture characteristics.

The biochemical transformation of raw food due to fermentation affects the organoleptic as well as rheological properties of a product. The changes in rheological as well as sensory properties is related with the modification of major component by the action of microorganism. For example, transformation of polysaccharides in bread dough by action of yeast produce ethanol, CO₂ and other simple compound which modify sensory as well as rheology of dough. The major micro-structural, bio-compositional and bio-chemical changes are due to microbial action are frequently described to understand the effect of fermentation on rheological as well as sensory properties of food products. The rate and quality of these associated major changes mainly depends upon concentration of saccharides for growth of microorganism as well as nature and existing microflorae. Hence, a proper monitoring of changes in rheological and sensory properties is necessary to optimize the controlled fermentation as well as design of process parameters from engineering and consumer point of view.

The biochemical changes directly responsible for changes in basic rheological and sensory characteristic including flow behavior, consistency, viscoelastic properties, hardness, adhesiveness, color, aroma, flavor and mouthfeel. The food industry is so diverse and exploring new and possibilities to catch diverse consumer worldwide, a proper understanding of effect of fermentation on mentioned properties will be key to hold competitive market. Hence, the present chapter will cover the basics of rheology and its role in food industry, effect of fermentation on rheological and sensory attributes of major class of food.

Dietary fibers mostly include non-starch polysaccharides such as celluloses, hemicelluloses, gums and pectins, lignin, resistant dextrins and resistant starches. Based on their water solubility, dietary fibers may be divided into two forms insoluble dietary fiber which includes celluloses, some hemicelluloses and lignins which is fermented to a limited extent in the colon and soluble dietary fiber which includes f-glucans, pectins, gums, mucilages and hemicelluloses that are fermented in the colon. Resistant starch generally considered to be represented by the total amount ofstarch and the product of starch degradation that are not digested in the small intestine andpass into large intestine, and regarded as a component ofdietary fiber. Herbal nutraceutical is used as a powerful instrument in maintaining health and to act against nutritionally induced acute and chronic diseases, thereby promoting optimal health, and quality of life. Dietary spices in their minute quantities has an immense influence on the human health by their antioxidative, chemopreventive, antimutagenic, anti-inflammatory, immune modulatory effects on cells and a wide range of beneficial effects on human health. Nutraceutical is the hybrid of ‘nutrition’ and ‘pharmaceutical’. Nutraceuticals, in broad, are food or part of food playing a significant role in modifying and maintaining normal physiological function that maintains healthy human beings. Functional foods are including whole foods and fortified, enriched, or enhanced foods or dietary components that may reduce the risk of chronic disease and provide a health and physiological benefit beyond the traditional nutrients it contains.

One key solution to combating malnutrition lies in promoting legumes (pulses), which are nutrient-dense, protein-rich, and vital for both human and animal consumption. Pulses have been a staple in diets
for centuries, providing essential nutrients like protein, fiber, vitamins, and minerals. They are not only beneficial for human health, reducing the risk of heart disease, diabetes, and cancer, but they also contribute to sustainable agriculture. Legumes can fix atmospheric nitrogen, reducing the need for synthetic fertilizers, improving soil health, and increasing agricultural productivity. However, despite their benefits, pulse production lags behind other staple crops like cereals. Nanotechnology deals with understanding and control of matter at 1-100 nm dimensions. Nano-sized materials have been part of everyday life in the form of biological entities and processes. Many of the structural building elements in foods are colloids in nature and are built up as a result of self assembly of nano-sized molecules in particles or at interfaces. The most important food raw materials-proteins, starches and fats undergo structural changes at the nanometer and micrometer scales during normal food processing. Unique phenomena occurring at this length scale are being exploited for novel food applications. Functional foods are products, in food or drink form, which influence specific functions in the body and thereby offer benefits for health, well-being, or performance beyond their regular nutritional value. Nanotechnology promises to provide means of altering and manipulating food products to efficiently deliver nutrients like proteins and antioxidants for precisely targeted nutritional and health benefits. Nanotechnology applications for functional food ingredients and additives offer range of benefits to the consumer in terms of innovative, tasteful and healthy food products. Nanoencapsulation systems aid smart protection and delivery of bioactives so as to ensure their stability, taste, colour, safety and bioavailability. The advent of nanotechnology has opened up innovations in food packaging with improved stability and barrier properties. However, need exists to develop regulatory systems for managing any risks associated with functional nanofoods and the use of nanotechnologies in the food industry.

In this century the usage of plastics had become very common. However, it is important to know as to what kinds of plastics are used for food handling and storage and the health hazards caused by using it. It has been observed that plastic packaging plays a significant role for the enhanced shelf life and in the ease of storage and cooking for many foods. Some kinds of plastic materials which are widely used for handling and storage of food and water include polyethylene terephthalate (PET). It is used in soft drinks, water, sport drinks, ketchups, salad dressing bottles, peanut butter, pickle, jelly and jam jars. This plastic is strong, heat resistant, resistant to gases and acidic foods. It can be transparent or opaque. It does not leach any chemicals that are suspected of causing cancer or disrupting hormones and can also be recycled.

Usage of High density polyethylene (HDPE) has been found to be common in milk, water, juice bottles, yogurt, margarine tubs, grocery, trash and retail bags. High-density polyethylene is stiff and strong but is not heat stable (it melts at a low temperature). It does not leach any chemicals that have a role in causing cancer or disrupting the hormones. HDPE can be recycled. Low-density polyethylene (LDPE) is used into making films of various types, some bread and frozen food bags and also in the making of squeezable bottles. Low-density polyethylene is relatively transparent. Many of the films are not heat stable either and may melt the food in case it is touching it. However, polypropylene (PP) is more heat resistant, harder, denser and more transparent than polyethylene and is therefore used for heat-resistant microwavable packaging and sauce or salad dressing bottles. Polycarbonate is clear and heat resistant. It is also durable and often used to make refillable water bottles and sterilisable baby bottles, microwave ovenware, eating utensils, plastic coating for metal cans. Tiny amounts of bisphenol A are formed when polycarbonate bottles are washed with harsh detergents or bleach (sodium hypochlorite). At high levels of exposure, bisphenol A is potentially hazardous as it mimics the female hormone estrogen. In addition, polystyrene (PS) and polyvinyl chloride (PVC) are also used during food material transportation and handling in supermarkets. Modern food safe plastic bags are plasticizer-free which do not leach harmful chemicals into the food during cooking.

Probiotics are measured in colony forming units (cfu). CFUs are generally measured in the millions or billions per serving. Probiotics are most commonly beneficial bacteria, but can also be friendly fungal or other organisms, that are typically freeze dried to stabilize them in an inert state during storage and production. Then their continued stability and viability, as measured by CFU counts when cultured, is dependent on limiting their exposure to stimulating environmental conditions such as temperature and moisture. Besides refrigeration, this protection can be done by packaging in glass or by adding freshness packets that helps to absorb and reduce moisture in the package.

Introduction

Since the last century, nutritional science has made a remarkable contribution to the biological sciences through identification of diverse nutrients and their sources, functions, requirement, deficiency symptoms and their remedial measures etc. The advent of high-throughput sequencing technologies together with bioinformatic tools identified the presence of 100 trillion of microorganism belonging to all forms of life in the gastrointestinal tract. In fact, the whole gut microbial consortia are considered as a virtual organ in human and animals and is responsible for the development and functioning of series of essential physiological activities including digestion, absorption, metabolism, immunity, homeostasis, brain and gut development, resistance against disease etc. According to the modern scientific dogma, the human being is in fact a “Superorganism”, carrying consortium of numerous symbiotic Eukarya, Bacteria, Archaea and Viruses. The gut microflora has been co-evolved with human and presumed to maintain an intricate balance among different microbial communities. Upon introspection about the functionality of the gut microflora, it is amply clear that a few of these microorganisms have the ability to make healthy state; while other members are responsible for health-related problems including food poisoning, diarrhoea, abdominal pain, indigestion, inflammatory bowel disease, predisposition to colon cancer, compromising immunity, allergy etc.

Introduction

Food is any substance or a product obtained from nature, which contains nutritive and non-nutritive components that help to maintain or improve the health of an individual if consumed in optimal amount (Sukhneet and Malhotra, 2014). Globalization of food production and procurement makes food chains longer and more complex and increases the risk of food safety incidents. Infections and diseases arising from contaminated/adulterated food remain threats to global public health (Havelaar et al., 2015; Luo et al., 2019). The WHO reports shows that every year foodborne diseases cause the death of 33 million people including many children (WHO, 2019). Food safety is linked to the presence of foodborne hazards in food at the point of consumption. Since food safety hazards can occur at any stage in the food chain it is essential that adequate control be in place. Therefore, a combined effort of all parties in the food chain is required to deliver safe food products to the final consumer. Effective and harmonized food safety systems shall manage and ensure the safety and suitability of food in each link of the supply chain.

Although the food industry has the prime responsibility of ensuring safe foods in most societies, the maintenance of a safe food supply is regarded as a responsibility of the government of that country. This responsibility has, over many years, led governments to adopt legislation, standards and regulations for food processing and to impose penalties when a business fails to meet the expectation. As with any legislation, an effective system for detecting failures to comply with the legal requirements increases compliance and hence, in this case, promotes food safety. Governments have an obligation to protect consumer health and this includes protection against food borne diseases. Food standards are therefore necessary to aid governments in protecting public health. However, the standards can only be effective when they are enforced through an efficient food control system. This therefore requires comprehensive legislation inspection, food monitoring and food borne surveillance. An efficient food control system must be supported by competent staff with good laboratory services. Political and institutional support and stability are also important elements.

In the present horticultural scenario of India, this is the burning issue as how best the underutilized horticultural crops can be exploited. There is tremendous potential for these crops especially for diversification. These plants can generate employment for millions especially to the natives ofdeveloping counties besides nutritional security. Traditional wisdom of Indian farmers if used properly can pave the path for transforming the economy of developing nations. There are great opportunities for the people to identify crops, explore their market, standardize their cultivation and processing techniques, document them and provide jobs to millions. This will salvage the people from exploitation by multinational companies of developed nations and can give a new direction to sustainable agriculture.

Due to the globalization of the food supply there has been a need to strengthen food safety systems in and between the countries. In this regard the World Health Organization (WHO) has promoted efforts in improving the food safety from farm to plate which started on World Health Day, 7 April 2015. The World Health Day 2015 slogan was “From farm to plate, make food safe”. The informal food production and marketing system is still strong in most countries of the South-East Asia Region, for the enforcement of food safety regulations. Traditionally, the preferences have been for hot and well-cooked food. These habits are partially responsible for preventing foodborne infections. In many countries street food has become very popular as it is cheap. Hygienic conditions are improving, provided that potable water supply and clean facilities are ensured by municipal authorities. Many waterborne and diarrhoeal diseases could be prevented with the introduction of bottled drinking water. The awareness and education on food safety by the consumers has strengthened in the enforcement of food standards. This has improved the hygienic practices and has helped in the prevention of foodborne illnesses. The “WHO Five keys to safer food” serves as the basis for educational programmes to train food handlers and educate the consumers. These help in preventing the foodborne illnesses. The important points are to keep food surfaces clean, washing of all utensils, plates and cutlery, keeping the raw food separate from the cooked food. Cooking food thoroughly to the appropriate temperature, keeping food at safe temperatures, both for serving and storage and using safe water and raw materials.

Carrot, radish, turnip and beet root are major root crops grown in India. In addition, root crops like rutabaga, parsnip, parsley, chervil and celeriac are grown in a limited scale in different parts of the world. There are several other roots and modified underground plant parts that grow in forests and consumed by tribes, but they are not commercially cultivated. Carrot, radish, turnip and beet root are generally consumed as cooked vegetables or fresh salads or as pickled vegetables.

5.1. Carrot

Carrots belong to the Umbelliferae family, named after the umbrella-like f lower clusters that plants in this family produce. As such, carrots are related to parsnips, fennel, parsley, anise, caraway, cumin and dill. Carrot, Daucus carota L. is believed have been primarily originated in Afghanistan, South western Asia and Mediterranean region. Daucus carota ssp. Carota is the most common wild form in Europe and South West Asia, and the present day cultivated carrots have most probably originated from this sub-species.

Haryana, Andhra Pradesh, Punjab and Tamil Nadu, Karnataka, Uttar Pradesh and Assam are the major producers of carrot in India.

Cultivars/Varieties: Varieties with long, orange coloured and smooth roots are preferred in India. Both indigenous and exotic varieties having different root length, shape and colour are grown. Temperate or European type varieties are Nantes, Half long, Early Nantes, Chantenay, Chaman, Pusa Yamadagni and Ooty-1, which require low temperature of 4-8°C for flowering. Tropical or Asiatic type varieties do not require low temperature for flowering and can be grown in plains also. The varieties belonging to this group are Pusa Kesar, Pusa Meghali and Hisar Gairic. Some varieties like Gold King, Indian Kuroda and Super Kuroda are also marketed by private seed companies.

INTRODUCTION

Rubber cultivation in regions extending from 10°N to 10°S latitude is known as the traditional region and the areas other than its natural climatic origin is termed as the non-traditional region. Northeast India comprises majority of the non-traditional areas in India with major climatic constraints like high seasonal rainfall, excessive precipitation and to some extent dry conditions. These areas extending from 22 to 29^°N latitude, holds promise in extending rubber cultivation because of its exceptional climatic make-up and abundant amount of annual precipitation (2000 mm) distributed over a fair period of time.

This perennial crop generally yields latex rubber at the 7th year after planting (with an economic life span of 20 years), although the period (immaturity period) it requires, is higher in the non-traditional region (Rubber Growers Companion, 2006). This immaturity period has also been shown to reduce with water availability in sub-humid climates (Vijayakumar et al. , 1998). Harvest of this crop is by tapping. Tapping is a process of controlled wounding during which thin shavings of bark are removed, thus opening the latex vessels which exude latex. Dry rubber yield is obtained after the latex is coagulated and rolled into sheets (about 500gm) which is then smoked and dried.

Saccharification: The process of breaking a complex carbohydrate (starch or cellulose) into its monosaccharide components is called saccharification.

Saccharimeter: A device (polarimeter) used for measuring the amount of sugar in a solution is called saccharimeter. It is also known as saccharometer. It is a hydrometer with a special scale.

Saccharin: A crystalline compound C7 H5 NO3 S that is unrelated to the carbohydrates, is several hundred times sweeter than sucrose, and is used as a calorie free sweetener.

Saccharomyces: It is one of the genus (Saccharomyces) of the family Saccharomycetaceae and is usually unicellular yeasts (brewer’s yeast) that are distinguished by their sparse or absent mycelium and reproduced asexually by budding.

Safe food: Food that provide maximum nutrition and quality while revealing a minimal hazard to public health and they assume any risk present to be minimal.

Today it has been understood that yeasts have great potentials as novel probiotics (Nayak, 2011). They have been found to be safe for human consumption in traditional fermented foods (Jakobsen and Narvhus 1996). Yeasts have a great physiological importance inside the gastrointestinal (GI) tract (Czerucka et al., 2007; Gatesoupe, 2007). Jespersen (2003) has mentioned the role of consuming fermented foods and the health benefits attributed with it.Yeasts are known for prevention of table olive (Arroyo lopez et al., 2012). Bonatsau et al. (2015) have shown multi-functional property of yeast as starters.

Packaging is an essential tool to make products stand out from the competition. Beyond the shelf appeal, packaging also provides protection to the contents from physical, chemical and microbiological hazards. However, a lesser known fact is that the same packaging material could also be a source of chemical contaminants, and hence, may impact food safety as well as food quality. Among the different components of packaging material, packaging inks play a critical role as they might hamper product and consumer safety.

Each packaging ink is a mixture of different chemicals and some of these chemicals might be harmful with the potential to migrate to the foodstuff. In terms of risk, the chemicals could be toxic, carcinogenic, mutagenic, repro-toxic and even endocrine disruptors. The chemical contaminants from the packaging inks can get transferred to the foodstuff by a process called migration.

Over the last two decades, a number of scientific papers have been published, revealing the migration potential of substances from the printed matter. However, the first big scandal that brought the subject alive was about the f indings of isopropyl thioxanthone (ITX, a low molecular photo initiator used in UV inks) in baby milk and other liquid foodstuffs all over Europe, resulting in a product recall in the year 2005. The food scandal alerted the packaging chain about the linkage between packaging inks and food safety. Consequently, the authorities issued strict regulations for the application of printing inks as well as general food control measures.

1. Introduction

Storage is an important part of any food grain processing chain. Storage of raw and processed food grain has been used by humans since time immemorial as a prerequisite for insuring food security due to off time availability, and for holding seed grain for long periods (Pande and Mishra, 2012). After harvesting grains may be required to be stored for long periods before these are marketed or used as food or seed. The grain storage is mainly carried out for three purposes viz (i) to retain a supply of food (ii) to service a trading system and (iii) to retain seed for planting the following season (Hall, 1980). Storage is, therefore, carried out by the producer, trader, processor, and the exporter and at all these levels the methods adopted affect the quality of food stuffs. The length of time grains can be safely stored will depend on the condition it was harvested and the type of storage facility being utilized. Grain storage and handling is a major concern for food grain growers and processers worldwide (Mohan et al., 2011; Pande and Mishra, 2012). Depending upon the condition and uses food grains may be stored in different storage structures using traditional or modern storage methods. Different storage structures are used by farmers with the traditional names like Gumma, Oliya and Jute bag. Caswell (1973) recorded 50 to 60% of insect damage on food grain after six months of traditional storage. A typical range of storage methods encountered in tropics and subtropics region is given in Table 1.
