U value: U value is a measure of the heat transmission through a building part (wall or window) or through a given thickness of a material (insulation). U values with lower numbers indicate better insulating properties.

UHT milk: This milk is homogenized, heated to atleast 135^oC for about 2-3 second, cooled rapidly and then packed in sterilized containers aseptically. The milk in packs can be stored for several months without refrigeration. The nutrient loss is negligible. Used for making yogurt commercially as it does not need to be boiled again.

UHT pasteurization: The milk is heated to ~150^oC for a fraction of seconds practically no holding period. It is also called ultra pasteurization.

UHT sterilization: It is method in which food is sterilized, cooled and then aseptically placed in previously sterilized containers which are subsequently sealed in an aseptic environment.

Ultimate analysis: It is used for determination of a particular element or a compound in a food material.

Ultra heat treated milk: It is designation of the milk sold for liquid consumption after subjection to ultra high temperature to sterilize the milk by killing bacteria and other microbes including spores.

Zeatin: Zeatin is a cytokinin C₁₀H₁₃N₅O first isolated from the endosperm of Indian corn.

Zeaxanthin: Zeaxanthin is an isomer of lutein occurring in fruits and vegetables (spinach and corn) (Plate 260, 261 and 262).

Veterinary public health deals with the contributions of veterinary medicine to public health. It is concerned, in the first instance, with the control and elimination of zoonoses and also with the following areas of activity:
    ·    Food hygiene (production, processing and distribution of foods of animal origin)
    ·    Environmental contamination and degradation by animal wastes and animal products
    ·    Comparative medicine (eg. Studies in animals on naturally appearing cancer, cardiovascular disease, metabolic and other disorders encountered in humans)
    ·    Laboratory animal medicine
    ·    Education and training in VPH and communication with the public
    ·    Reproduction biology
    ·    Aspects of mental and societal health
    ·    Emergency veterinary functions in natural disasters and other catastrophes.

Bacteriophage is the term applied to bacterial viruses. Bacteriophage having the ability to lyse certain sensitive living cells. Phages are small particles, which can only be seen in the electron microscope after the application of suitable staining techniques. All phages have a head and most have a tail. The head may be isometric or prelate with a hexagonal outline.

There are two types of phages virulent and temperate which enter a different relationship with the host, the lytic and lysogenic cycles respectively.

Tuberculosis

Tuberculosis has been recognized as one of the most important infectious diseases in the world because of its high global impact and its chronic debilitating character, particularly in the poor section of society. Milk-borne tuberculosis is directly or indirectly related to the consumption of raw milk from infected dairy herds.

Normally raw milk contains different levels of inhibitory substances, which restrict the normal development of bacteria and some times may even kill them. The degree of inhibitory activity varies considerably in milks of different species, viz, cow, buffalo, human. Maximum activity present in human milk, variations occur in the milks of individual animals and some times even at different milking or from different quarters of the udder of the same animal.
There are two groups of antimicrobial substances present in milk:
    1.    Inherent or naturally occurring substances in milk. 
    2.    Non- inherent compounds secreted into milk from other sources.

The lack of mechanistic understanding of probiotic activity is a major drawback for the prediction of safety of probiotic intervention. The complex gut-associated microbial ecosystem and nutritionally related factors are the most important environmental triggers for the development and modification of chronic degenerative diseases including immune and metabolic pathologies. In fact, the interaction between the gut microbial ecosystem and the host is considered to be a critical factor in overall health or disease. Whether probiotics will exert protective, harmful, immune-stimulating or immune-suppressing effects on a host is dependent on the interaction between the microbial signals, the genetic make-up of the host and the effects by the environment. Many studies have revealed that certain probiotic bacteria stimulate immune cell proliferation and activity as evidenced by the production of cytokines and antibodies, thereby enhancing the effectiveness of the immune response against pathogens. Ng et al. (2009)

Antibiotic Resistance and Gene transfer
 
It is important that probiotic strains should be assessed for their phenotypical antibiotic resistance and potential to transfer resistance gene as otherwise they cannot be used in food (BgVV, 2000; Vankerckhoven et al., 2008). It is vital to do research on characterization of acquired resistance mechanisms and transferability of resistance genes and on methods for determining transferability.

In spite of the problems with dosage and viability of probiotic strains, a lot more work is required for industry standardization and safety issues. However, it is noted that probiotics have considerable potential against many pathogenic and other diseases. A wide range of clinical trials are still needed to standardize and optimize the conditions. Ongoing basic research will continue to identify and characterize existing strains of probiotics, identifying strain-specific outcomes, determine optimal doses needed for certain results and assess their stability through processing and digestion.

1. Fundamental Concepts of Unit Operations

    1.    Process is the set of activities or industrial operations that modify the properties of raw materials with the purpose of obtaining products to satisfy the needs of a society.

    2.    Food process engineering includes the part of human activity in which the knowledge of physical, natural, and economic sciences is applied to agricultural products as related to their composition, energetic content, or physical state.

    3.    Food process engineering can also be defined as “the science of conceiving, calculating, designing, building, and running the facilities where the transformation processes of agricultural products, at the industrial level and as economically as possible, are carried out.

    4.    In a discontinuous operation the raw material is loaded in the equipment; after performing the required transformation, the obtained products are unloaded. These operations, also called “batch” or “intermittent,” are carried out in steps:

    1.    Water activity (a_w) affects food chemistry and can be controlled by removal (dehydration or drying) or by chemically binding the water, reducing its activity. Water activity in foods ranges from 0.95 to 1.00 in fresh meats and vegetables to 0.20 in dried milk.

    2.    Water activity (a_w) may be defined in a number of ways, qualitatively, aw is a measure of unbound, free water in a system available to support biological and chemical reactions.

    3.    Water activity, not absolute water content, is what bacteria, enzymes, and chemical reactants encounter and is affected by at the micro environmental level in food materials.

    4.    Two foods with the same water content can have very different aw values depending upon the degree to which the water is free or otherwise bound to food constituents.

    5.    The term “water activity” is related to relative humidity. Relative humidity is defined as the ratio of the partial pressure of water vapour in the air to the vapour pressure of pure water at the same temperature.

    6.    Water activity or aw is a property of solutions and is the ratio of vapour pressure of the solution compared with the vapour pressure of pure water at the same temperature. Under equilibrium conditions water activity equals:

Materials Required 

Fruits/vegetables, hand refractometers, fruit pressure tester, weighing balance, scale, chemicals and glassware required for analysis.

Procedure

    1.    Go to the orchard or vegetable field and collect samples of fruits and vegetables
    2.    Apply the specific maturity indices to the samples

Materials Required

Fruits/ vegetables, weighing balance, plastic crates, CFB boxes or other packaging material fruit pressure tester, hand refractometer, markers etc.

Procedure

    1.    Harvest the fruits
    2.    Subject them to various pre-treatments (as discussed in previous exercise).
    3.    Record their initial parameters i.e. weight, firmness, surface colour, TSS, rotting etc. 
    4.    Place properly packed commodity in storage alongwith a check under ambient conditions
    5.    Record the observations regarding changes in quality during storage
 

Materials Required

Fruit, pulper, fruit mill, hydraulic press, screw type juice extractor, stainless steel pans, chemical preservatives, glass bottles, closures, crown corks, crown corking machine, plastic barrels.

Procedure

    1.    Select and weigh sound fruits/vegetables for extraction of juice/pulp.    
    2.    Wash and peel the fruits as required.
    3.    Extract the juice by hot or cold process.
    4.    Pasteurize the juice/pulp to inactivate the enzymes and partially kill microorganisms.
    5.    Preserve the juice/pulp by heat processing after hot filling and hermetic sealing or by addition of permissible quantities of suitable preservatives.
    6.    Label the bottles properly and keep them for storage

Materials Required

Fruits or fruit pulp, steel pans, weighing balance, refractometer, sugar, salt, spices, acetic acid, citric acid etc. 

Procedure

    1.    Extract fruit pulp as told in earlier exercises. 
    2.    Take a known quantity of freshly extracted or preserved pulp.
    3.    Weigh sugar (about half the weigh of pulp).
    4.    Heat pulp and sugar over a gas flame.
    5.    Add spices, chillies, salt, citric acid (if required) etc. and cook
    6.    Record the TSS to judge the end point. It should be more than 50o Brix.
    7.    Add measured quantities of acetic acid and sodium benzoate at the end.
    8.    Cool and pack in pre-washed and sterilized glass jars
    9.    Label and store.

Materials Required

Fruits or vegetables, stainless steel knife, steel pans, Can Body Reformer, Flanger, Double seamer, weighing balance, Refractometer / Salometer, sugar or salt etc. 

Procedure

    1.    Wash the selected fruit or vegetable (as the case may be) 
    2.    Cut into pieces or slices (the size and shape may depend on the fruit/ vegetable but it should not be too large or too small)
    3.    Blanch the material in boiling water for 1-2 min for effective inactivation of enzymes. 
    4.    Prepare the sugar syrup of strength 40o Brix or brine of 1-3 % strength.
    5.    Prepare the can body using a can body reformer and flange the ends in a flanger.
    6.    Seal the base plate using first and second roller operations of the double seamer. 
    7.    Transfer the prepared fruits / vegetables into the cans. 
    8.    Pour in hot syrup or brine into the cans.
    9.    Place the lid over the top of filled can. (follow the first roller operation of the double seamer, if the cans are OTS cans)
    10.    Exhaust the cans in boiling water for about 10 min. to exclude any dissolved air out of the tissues or syrup/brine.
    11.    When the temperature of the centre of can reaches 79-80 ºC for fruits or 82ºC for vegetables, remove the cans from the exhaust box and seal them properly (follow the second roller operation of the double seamer, if the cans are OTS can).
    12.    Process the sealed cans at 100ºC and 115-121ºC for fruits and vegetables respectively for 15-30 min in case of fruits and 25-45 min. in case of vegetables.
    13.    Cool the cans immediately in cold water and air dry them at room temperature.
    14.    Label and store in a cool dry place.

Materials Required

Canned product, weighing balance, can cutter, vacuum/pressure guage, seam checking guage, Refractometer / Salometer etc. 

Procedure

    1.    Take a canned product say canned peach.
    2.    Record the weight of the can (A)
    3.    Record the information marked on the label i.e net  weight, date of packing, etc
    4.    Observe the can externally for the concavity of the lid.
    5.    Record the vacuum of the can by using a vacuum guage
    6.    Cut the lid of the can with a can cutter
    7.    Record the head space
    8.    Put all the contents over a sieve and let the liquid drain
    9.    Record the weight of empty can (B) to calculate net contents
    10.    Record the drained weight of the pieces.
    11.    Record whether the liquid is syrup or brine
    12.    Record the TSS of the salometer reading of the liquid (as the case may be)

Materials Required

Cut flowers, 1000 ml conical flasks, scissor, tape, distilled water, chemicals, weighing balance, volumetric flasks, labels, thermometer (max. & min. type) and hygrometer. 

Procedure

    1.    Collect fresh spikes of flowers
    2.    Cut at the base keeping about 25-60 cm of the cut flowers stick (uniformly for each flower).
    3.    Prepare Pulsing/ Vase solutions.
    4.    Put the prepared flower spikes in labeled conical flasks containing different Pulsing/ Vase solutions (for a known period of time).
    5.    Record the weight of the spikes and other observations daily.
    6.    Record the temperature and relative humidity of the storage chamber daily.
    7.    Analyse the recorded data and draw conclusion about the best vase solutions for the selected cut flower.

Materials Required

Fruit, vegetable or product sample, hot air oven, weighing balance, crucibles, petri plates, lead pencil / marker etc.

Procedure

    1.    Take crucibles  or petri plates and record the tare weight of crucibles / petri plates (C) and mark them
    2.    Cut the sample into small and thin pieces (if solid)
    3.    Put the sample into the crucibles / petri plates in three replications
    4.    Record the weight of crucibles + sample (C + S)
    5.    Put in hot air oven for drying at 70 + 2ºC.
    6.    Record the loss in weight after every 1-2 hrs till it becomes constant
    7.    Calculate the moisture and total solids. 

Materials Required

Sample, hot air oven, weighing balance, crucibles, muffle furnace, lead pencil / marker etc.

Procedure

    1.    After following the procedure for the determination of moisture (in silica crucibles as given in previous chapter) the same sample can be used for the determination of ash. 
    2.    Heat the dried sample in the silica crucibles over a heater/hot plate/burner to burn the carbon.
    3.    When it becomes completely black and no more smoke comes out of the sample, shift them to muffle furnace.
    4.    After heating the samples in muffle furnace, all the marks of pen / pencil/ marker are lost, so one would not be able to identify the samples and error of weights may occur. Therefore, it is advised to place the samples in the furnace in one or two rows and draw the diagram on a piece of paper for identification purpose.

Materials Required

Fruit/ sample, refractometers, thermometers, standard solutions of known TSS, temperature correction Tables.

Procedure

    1.    Calibrate refractometers of all ranges to be used.
    2.    The TSS of the juices/pulps/fresh fruits can be measured with the one having lowest range i.e. 0-32º Brix while, for measuring the TSS of concentrates, syrups, squashes, jams, jellies etc. refractometers of the higher ranges are made use of.
    3.    Put a drop of material on to the glass surface of refrectrometer’s prism, cover gently with the lid and observe the TSS against light.
    4.    Measure the temperature of the liquid which is being evaluated and apply temperature corrections (Annexure III).
    5.    Record the corrected value as the TSS of the sample.

Materials Required

Sample, reagents, beakers, conical flasks, pestle and mortar, funnels, volumetric flasks, pipettes, weighing balance, spectrophotometer/colorimeter.

Reagents

    1.    2% Metaphosphoric Acid Solution: Weigh 20 g of HPO₃ and dilute to 1 litre in water or 4% oxalic acid.
    2.    Dye Solution: Dissolve 100 mg of 2, 6 Dichlorophenol-indophenol dye (Phenolindo-2,6- dichlorophenol sodium salt, AR, C₁₂H₆Cl₂NNaO₂ 2-3H₂O) and 84 mg of sodium bicarbonate (sodium hydrogen carbonate AR, NaHCO₃) in hot (85-95ºC) distilled water. Cool and make up the vol 100 ml. Filter and dilute 25 ml of the dye to 500 ml with distilled water. 
    3.    Standard Ascorbic Acid: Weigh 50 mg of ascorbic acid (AR) and make up to 50 ml with 2% metaphosphoric acid or 4% Oxalic acid solution (1000 ppm i.e. 1000 µg/ml). Dilute 4 ml of this solution to 100 ml with 2% HPO₃ or 4% oxalic acid. (1ml = 40 µg ascorbic acid).

Materials Required

Specific gravity bottles, weighing balance, sample, pipettes, thermometer, distilled water 

Procedure

    1.    Take the sample and distilled water record their temperatures (they should be same for correct estimation). If the temperatures are not same bring both to 20ºC or the room temperature.
    2.    Clean and dry the specific gravity bottles properly before use.
    3.    Record the tare weight of the specific gravity bottle (T) alongwith the stopper.
    4.    Carefully fill the specific gravity bottle with distilled water up to the brim and then place the stopper tightly so as to exclude extra water. 
    5.    Dry the exteriors of the bottle with a tissue paper
    6.    Record the weight of (bottle + water) say A
    7.    Similarly, fill the same specific gravity bottle with test sample and record the weight (bottle + sample) say B
    8.    Calculate the specific gravity of solution using the following formula

Materials Required

Spectrophotometer, ethyl alcohol, beakers, pestle and mortar etc. 

Procedure

    1.     Preparation of sample extracts
        a.    Liquids : Centrifuge the juice at 5000 rpm for 4-5 min., and collect the supernatant. For liquid samples prepare a 40 % solution in ethyl alcohol. To 30 ml of the sample add 45 ml of ethyl alcohol and mix thoroughly. Filter through Watman 
No. 1 paper.

        b.    Semi-solid samples: To 15 g of blended sample add 15 ml of distilled water and 45 ml of ethyl alcohol. Mix thoroughly and filter through Watman No. 1 paper.
        c.    Dried products: Extract known quantity of sample (4-6 g) with 100 ml of 60% ethyl alcohol for 12 hrs and filter through Watman No. 1 filter paper.
    2.     Measure the absorbance of the samples at 440 nm for non-enzymatic browning and 400 or 420 nm for measurement of colour.
    3.     Prepare 60% ethyl alcohol solution as blank. Add 30 ml of distilled water to 45 ml of absolute alcohol and use as blank.

Materials Required

Sample, Liebig condenser, digestion flasks (700-750 ml cap), conical flasks, filtering cloth (thick linen cloth for clear filtration) reagents, muffle furnace, crucibles.

Reagents

    1.    0.255 N Sulphuric acid solution : Dilute 2.5 g (1.36 ml) of concentrated H₂SO₄ to 200 ml. Ensure correct concentration by titration.
    2.    0.313 N Sodium hydroxide solution: 2.504 g NaOH / 200 ml water nearly free from sodium carbonate. Ensure correct concentration by titration.
    3.    Asbestos Chips: gooch grade, medium fibre, acid wash and ignited
    4.    10% Potassium sulphate (K₂SO₄) solution: Dissolve 10 g of Potassium Sulphate (AR) in water and make up to 100 ml.

Materials Required

Soxhlet apparatus, petroleum ether, water bath, sample, grinder, weighing balance, filter paper, threads.

Procedure

    1.    Take the given sample and weigh it (A)
    2.    Dry the samples in an oven till there is no more weight loss and weight it (B)
    3.    Grind the sample into powder.
    4.    Place a weighed quantity of sample in filter paper, wrap the paper and tie it tightly with a thread so that no powder comes out of the paper during extraction. 
    5.    Pour approximately 100 ml of anhydrous ether into the bottom flask. Turn the heaters on. Set the temperature at about 40ºC.  
    6.    The ether will evaporate and circulate through the sample and again will come back to the flask. 
    7.    Repeat the process for about 16 – 18 hrs for complete extraction. 
    8.    Remove the sample and evaporate most of the ether from the mixture of crude fat and ether obtained during extraction.
    9.    Evaporate excess of ether from the crude fat sample by evaporation on a water bath. Evaporate till it is free from the fumes of ether. Record the weight (C).

Materials Required

Sensory scoring card, products, pen/ pencil for coding, plain water

Procedure

    1.    Assign codes to the samples i.e. a, b, c, …… or 1, 2, 3, ….. etc.
    2.    Keep the coded samples randomly (eg. c, f, a, b, d, e) in a row for evaluation
    3.    Start the evaluation of samples for various sensory attributes one by one. 
    4.    Evaluator should rinse his/ her mouth after each sample so as to avoid overlapping of taste, flavour etc.
    5.    Assign marks from 1-9 based on pleasurable and un pleasurable experiences.
    6.    Compute the means for a particular attribute on the basis of the evaluation of different evaluators (replications).
    7.    Find out the best sample on the basis of highest average scores obtained.

Materials Required

Sensory scoring card, products, pen/pencil for coding, plain water.

Procedure

    1.    Take the given two samples
    2.    Make them three by duplicating/repeating either one of the two
    3.    Assign codes to the samples eg. AAB, ABA, ABB,  BAB etc.
    4.    Ask the evaluators to evaluate the samples for any differences between the 3 on the given Specimen Evaluation Card.
    5.    Find out how many of the evaluators have chosen the odd sample correctly (say it is 16 out of 20 evaluators).
    6.    Now find out the degree of difference in the samples indicated by the evaluators who correctly found the odd sample (Say it is much as per 3, moderate as per 8 and slight as per 5 out of the 16 correct evaluators.).
    7.    Find out how many of the correct evaluators preferred A sample and how many the B sample (say 11 preferred A sample and 5 B sample).
    8.    After going through Annexure II you may conclude that the two samples differed significantly from each other as 16 out of 20 evaluators found the odd sample correct. But, the preference was not significant as it should have been at least 13 out of 16 judges indicating same preference so as to make it significant. So, it may be concluded that the two samples differ significantly but both are acceptable.

    4.    Evaluator should rank the samples on the basis of intensity of a single sensory attribute according to his / her preference.
    5.    Compute the means on the basis of the evaluation of different evaluators (replications).
    6.    List the samples in increasing or decreasing order of preference.

Food is basic to human being and agriculture is the catalyst between the two which is basically supported by natural resources. The human being is entirely dependant on food and food is fully dependent on agriculture and humanity. Eventhough food, agriculture and humanity have their own entity; they are inseparable for the survival and existence of each other. Hence, the three pillars of food, agriculture and humanity forming a triangle symbolize the roots of human civilization.

I find myself fortunate to have the opportunihj to live and experience the working life of the farmers and the farming in Kansas (USA), Nigeria (Africa), Saudi Arabia and Yemen (Middle East), Italy (Europe) and India, Myanmar and Thailand (Asia). It zvas fiirther strengthened by visits to farmers in another about 100 countries. Day after day and month after month and even years, it made me to realize that community culture, language and farming in each state, country and continent are different from each other but some things are common and that they are all doing farming, they are growing food and they all doing for the livelihood of their families, neighbors and communities near and far (Nath, 2011).

The foundation of agriculture is laid on available natural resources e.g. land, water, sunlight, air, plant, animal and human beings. The human beings, being the leader to manage the resources have contributed to redefine agricultural science and promote and develop technology. This has led to augment agriculture and its science and technology. At the end, the human efforts have brought about changes and improved agriculture production at the cost of excessive use of natural resources, knowing well that without natural resources, without good soil and water hardly anything will survive.

Presently world produces enough to feed the present human population, but it is not available to millions of people. It is not the lack of availability of food but is the unequal distribution and lack of entitlement which are causing hunger and malnutrition in millions of population.

In economics and business, specifically cost accounting, the break-even-point (BEP) is the point at which cost or expenses and revenue are equal: there is no net loss or gain, and one has “broken even”. A profit or a loss has not been made, although opportunity costs have been paid, and capital has received the risk-adjusted, expected return.
For example, if a business sells less than 1000 liters of milk each day, it will make a loss, if it sells more, it will be a profit. With this information, the business managers will then need to see if they expect to be able to process and sell 1000 liters of milk per day.

Apart from the job content and specialization, the conditions or the atmosphere in which employees work is critical to their productivity. Work environment includes the tools and equipment provided to perform the job, the atmosphere at the work place, worker motivation etc.

Tools and Equipments

The quality of tools and equipment provided to a worker has a profound effect on the worker’s contribution to his job. A poorly designed tool can cause excessive physical burden on the worker and may result in fatigue. A faulty computer monitor can cause severe eyestrain, which might affect productivity in an office environment. Hence, tools and equipment should be appropriate for the production task. The design should consider ergonomic factors like grasping pressure, size, weight, ease of use etc. when designed properly, tools enable users to work efficiently, resulting in higher productivity. The equipment installed should be able to meet the capacity requirements of the job, have safety features and be easy to use. The use of the right tools and equipment can improve productivity in an organization substantially.

A broader definition of a tool is an entity used to interface between two or more domains that facilitates more effective action of one domain upon the other. The most basic tools are simple machines. For example, a crowbar simply functions as a lever. The further out from the pivot point, the more force is transmitted along the lever. A hammer typically interfaces between the operator’s hand and the nail the operator wishes to strike.
A telephone is a communication tool that interfaces between two people engaged in conversation at one level. And between each user and the communication network at another. It is in the domain of media and communications technology that a counterintuitive aspect of our relationships with our tools first began to gain popular recognition.
Marshall McLuhan famously said “We shape our tools. And then our tools shape us.” McLuhan was referring to the fact that our social practices co-evolve with our use of new tools and the refinements we make to existing tools.

The compliance with hygienic and aesthetic standards in the dairy factory is, in the final analysis, dependent on the human element. Each employee, from top management to the most junior operative, has his role in the factory sanitation programme and carelessness at any stage may cause quality deterioration of products or endanger the health of consumers. Legal action against the dairy may also result from neglect of hygiene. Personnel hygiene refers to the personal cleanliness and related habits of the workers. Milkborne infections frequently originate from food contaminated by workers through their hands, breath, hair, perspiration, pimples, infected wounds, coughs, and sneezes. Transfer of even traces of human and animal excreta by the workers is a potential source of pathogenic microorganisms. Foodborne illness is known to originate from workers who were ill and practiced unsanitary food handling methods or poor personal hygiene. Even the healthy worker, who does not exhibit the symptoms of the disease, may harbour food poisoning bacteria in the respiratory or intestinal tract. It is always desirable, as a matter of practice, to look at different parts of the human body in terms of potential sources of bacterial contamination. Provisions regarding personal hygiene of employees are contained in all legislation dealing with milk treatment.

Water Requirements

Dairy plant requires large quantities of water on a daily basis for processing and cleaning purposes. Normally the specific water consumption ranges from 1000-5000 litres per 1000 litres of milk processed. The actual requirement can vary between dairies and is a function of 
    a)    Manufacturing process or manufacturing profile.
    b)    Auxiliary processes such as steam generation, design of the refrigeration processes and extent of social services.
    c)    Multiple use/reuse.
Water is a very valuable basic natural resource  and needs careful consumption. The water supply system in a dairy plant should be designed in such a way that consumption for each manufacturing department and auxiliary processes can be determined. This makes it possible to influence water consumption directly, and major losses can be determined very rapidly.

The total milk production in the country for the year 2013-14 has been estimated at 126 million metric tonnes and the demand is expected to be 180 million tonnes by 2020. To achieve this demand annual growth rate in milk production has to be increased from the present 2.5 % to 5%. Thus, there is a tremendous scope/potential for increasing the milk production through profitable dairy farming.

a. Requirements of project report for setting up dairy units

Project report can be prepared by a beneficiary after consulting local technical persons of State Animal Husbandry Department, DRDA, Dairy Co-operative Society / Union / Federation / commercial dairy farmers.

To meet this demand entrepreneurship initiatives are need of the hour. Further, younger generations of India are more interested in commercial dairy farming rather than subsistence based farming. Therefore, scientific as well as commercial dairy entrepreneurial training to farmers about advanced technology used in breeding, feeding, housing and healthcare is essential.

a. Barriers for Entrepreneurship in dairy

An average dairy entrepreneur faces several barriers to start a new enterprise. Some of them are as under

    1.    Lack of financial support: A major stumbling block for many dairy farmers to expand production or diversify into new high value enterprises is lack of access to finance. Farmers who are starting new enterprises often face difficulty raising investment capital.

a. Financing the dairy enterprise

Dairy rearing provides triple benefits of income, employment and nutritional security to the society and is important source of subsidiary income to small/marginal farmers and agricultural laborers. Finance is a prerequisite and of paramount importance for setting up of a dairy enterprise whether a dairy farming unit for milk production, sheep or goat unit/piggery unit, dairy/poultry processing unit etc. Decisions about credit are often most important judgments that people in the agricultural industry must make. These decisions often determine whether individuals operating in input, production, processing, and services based dairy enterprise would succeed in making profit.

Bananas and plantains constitute the fourth most important global food commodity (after rice, wheat and maize). They are cultivated in over 120 countries in the tropical and subtropical regions of the world in an area of  approximately 100 million hectares, where they constitute a major staple food crop for millions of people, as well as providing a valued source of income through local and international trade.
 
Banana is one of the oldest fruit crops of India, finding its reference even in epics like Ramayana. India is  believed to be one of centres of  origin, besides southeast Asian countries like Burma, Thailand, Malaysia and Indonesia. It is a crop having multifarious uses as every part of the plant is utilized and hence aptly  called as ‘Kalpatharu’ the plant of virtues. It is important internationally from the point of view of  trade as well as livelihood security.

Most banana producers in Africa, Latin America and Asia are small-scale farmers who grow bananas either for home consumption or local markets. Because bananas and plantains produce fruit year-round, they provide an extremely valuable food source during the hunger season (when the food from one annual/semi-annual harvest has been consumed, and the next is still to come). Bananas and plantains are therefore critical to global food security. However, the export trade of banana depends mainly on commercial plantations in Latin America, East Asia and Africa. These plantations are owned by multinational corporations.

By definition, minimal processing would encompass any procedure, short of traditional complete preservation procedures (heat sterilization etc.) that adds value to the fruit or vegetables (Floros, 1993). Other terms used to refer minimally processed products are lightly processed, partially processed, fresh processed, fresh cut and prepared. Minimally processed fruits and vegetables are products those have the attributes of ‘fresh-like’ quality. A number of minimally processed products of fruits and vegetables are now being produced like peeled and sliced potatoes, shredded lettuce and cabbage, washed and trimmed spinach, chilled peach, mango, banana, melon and other fruit slices, vegetable snacks such as carrot and celery stick  and cauliflower and broccoli florets, packaged mixed salads, cleaned and diced onion, peeled and cored pineapple, fresh sauces, peeled citrus fruits and microwaveable fresh vegetable trays. Minimal processing of fruits and vegetables has two purposes. First, it is important to keep the product fresh but convenient without losing its nutritional quality. Second, the product should have a shelf life sufficient enough to facilitate distribution within the region of consumption. The microbiological, sensory and nutritional shelf life of minimally processed fruits and vegetables should be at least 4-7 days but preferably even longer (Ahvenainen, 2000).

Microbial contamination sources: Foods may be contaminated by microorganisms at any time during harvest, storage, processing, distribution, handling, or preparation. The primary sources of microbial contamination are soil, air, animal feed, animal hides and intestines, plant surfaces, sewage, and food processing machinery or utensils. Since most foods either carry or eventually acquire bacteria, molds, or yeasts, microorganisms are the major causes of food spoilage. The increased load of microorganisms leads to rapid spoilage.

Organisms: Bacteria and fungi (yeasts and molds) are the principal types of microorganisms that cause food spoilage and food- borne illnesses. The typical microorganisms that cause food spoilage are bacteria (e.g., Pseudomonas), yeasts (e.g., Candida), and molds (e.g., Rhizopus). The growth of microorganisms in the food will increase the load of microorganisms, and the heavier load will add to the difficulty of preventing spoilage and may influence the kind of spoilage to be anticipated.

Food spoilage may be defined as any change that renders food unfit for human consumption. These changes may be caused by various factors, including contamination by microorganisms, infestation by insects, or degradation by endogenous enzymes (those present naturally in the food). In addition, physical and chemical changes, such as the tearing of plant or animal tissues or the oxidation of certain constituents of food, may promote food spoilage. Foods obtained from plant or animal sources begin to spoil soon after harvest or slaughter. The enzymes contained in the cells of plant and animal tissues may be released as a result of any mechanical damage inflicted during postharvest handling. These enzymes begin to break down the cellular material. The chemical reactions catalyzed by the enzymes result in the degradation of food quality, such as the development of off- flavours, the deterioration of texture, and the loss of nutrients. The enzymatic changes in foods are desirable to some extent as in the case of ripening of fruits, but continued enzymatic activity beyond an optimum point becomes food deterioration due to rotting. The native enzymes may be inactivated by heat, radiation or by the use of specific chemicals.

10.1 CEREALS AND CEREAL PRODUCTS

CONTAMINATION: The sources of contamination in cereals and cereal products are soil, insects, air, etc. Most of the microorganisms are removed with the outer portions of the grain during milling. The bleaching agents used during milling also reduce numbers of microorganisms. The bacteria in wheat flour include Bacillus, Micrococcus, Flavobacterium. Mold spores are chiefly of Aspergillus spp and Penicillium spp and in addition Alternaria, Cladosporium and other genera are found. The numbers of microbes in cereals and cereal products vary widely from few hundred per gram to million. Corn meal contains several hundred to several thousand bacteria and mold per gram.

Cultural characteristics of bacteria deal with the appearance of the growth in various liquid and on solid media. The growth characteristics of most of the bacteria are typical of the group or species and help in their identification. The terminology employed to describe various features of bacterial growth are mentioned below.

When unwanted organism settle on objects, substances or pure culture is called contamination.

Infection

Invasion of the body of a man or an animal or a plant by disease producing organism. Infectious disease is a condition brought about by an infection of the body by an organisms which is responsible for the disease. Organism that are capable of bringing about infectious diseases are called pathogens while those organism without this capacity are said to be non pathogenic.

Commensals

Organisms on skin and mucous membrane which multiply without causing damage to the tissue.

Subclinical infection / latent infection

When organism enters the tissue and lead to immunity without the appearance of any definite clinical symptoms.

Human beings have been concerned about the concept of food safety since time immorial. Around the globe there has been major improvement in food safety management in the last twenty years. Looking into the progress made on the ways to make food safe and how to make them free from pathogens, this book, will explain food hygiene, the journey of research been taken in food safety till date and the challenges that we are going to face in future to ensure food safety and its wholesomeness. It also includes the role and responsibilities of the various sectors of society, namely governments, food industry, consumers and academia.

In the beginning of the twentieth century many modern food safety policies have been established. In the packing of meat and in food processing industries a lot of work has been done (Sinclair 1906). Another second generation policy includes the outbreak in the United States in early 1990s’ of pathogen E. coli O157:H7 and the BSE scandal of the late 1990s in the UK Lopman et al., (2003) have discussed on viral outbreak in europe. Currently, the crisis has come due to the economic and technological transformations which have taken place in food and the food supply system. As these changes have many health risks the public is very concerned. Therefore, the control forms of safety regulation and food safety laws have come into the picture. These policies include continuous line inspection, visual product inspection and detailed specification of approved hygiene practices. There is a need of a public health-focused policy which works towards the preventive integrated management of foodborne hazards from farm to table. This includes the use of modern science based risk management tools which will increase the efficiency accurately towards public health. A lot needs to be worked out for better implications. Current efforts to modernize food safety policy around the world are being worked out by the use of risk analysis and cost-benefit analysis in public administration and also the quality management in industry. The role of public economics plays an important role in food safety policies. For the social benefits the policy makers need to take decision on the costs and strengthening of the risk assessment. Today there are globalized markets and this can influence the health globally. Emerging economies like China are industrializing and urbanizing rapidly like that of Europe and North America.

Food safety scientifically describes various methods of handling, preparation and storage of food to prevent any foodborne illnesses. However, it is important to check the safety between industry, market and the consumer. From the food industry to the market the practices relating to food labeling, food hygiene, food additives and pesticide residues are important to be looked into and the policies on biotechnology. The governmental imports and exports needs to be given proper guidelines. Certification systems and Inspection for foods need to be installed which should be clean and corruption free. When all this is properly considered the food could be safe in the market. This may allow for safe delivery and safe preparation of the food for the consumers. Many diseases are transmitted by food which serves as a growth medium for bacteria and cause food poisoning. In the developed countries it has been observed that there are many intricate standards for food preparation. However, in the developing countries the availability of adequate safe water itself is a question. It is possible to prevent food poisoning to 100%. An ordinance and code regulation in US (1943)was given.
