2.1 Introduction
The continuous production of dry milk has become consistently significant within the dairy industry and is expected to continue growing due to its advantageous features. These include improved shelf life, reduced storage
requirements, and lower transportation costs, all of which contribute to favourable economic outcomes.
For example, non-fat dry milk is also known as skim milk powder, dried skim milk, non-fat dry milk solids, or dehydrated skim milk. Similarly, products like dried whole milk, dried cream, and dried buttermilk are often regarded as dried or powdered whole milk, cream, and buttermilk, respectively, based on their specific compositions.

1.1 Introduction
Concentrated milks, like evaporated milk and sweetened condensed milk, serve as practical substitutes for fresh milk in regions where access to it is limited or where transportation and storage are challenging. These products go through specific processing techniques to reduce their water content, thereby improving their shelf life and transportability. Evaporated milk is created by removing water through evaporation and then
sterilizing it to prevent microbial growth. This process results in a thicker consistency and a slightly caramelized flavor due to the heat treatment. On the other hand, sweetened condensed milk is made by adding a significant amount of sucrose to the milk and excluding oxygen, which inhibits microbial growth. This results in a thick, sweet product suitable for various culinary uses. These concentrated milk products are usually packaged in small cans, making them convenient for storage and transportation. However, they are sometimes diluted before consumption with water to resemble the taste and consistency of fresh milk. In regions where even concentrated milks are not easily accessible, alternatives like whole milk powder or recombined milk are used. These alternatives involve dehydrating milk into powder form or reconstituting milk components to create a liquid similar to fresh milk. Innovations in processing and packaging have led to the development of alternative uses for concentrated milks, expanding their versatility beyond traditional applications. These products continue to provide essential dairy
nutrition in areas where fresh milk is scarce or hard to obtain, offering a shelfstable solution to meet dietary needs.

Pollution emanating from industrial units has become a major problem globally and it is generally monitored by some government agencies. These agencies enforce various laws and regularly carry out checks at the industrial units. Same is true with regards to slaughterhouses or abattoirs. Pollution parameters are parameters against which the effluents coming out of the Effluent Treatment Plant (ETP) of slaughterhouse or any industrial entity is measured against. Effluent generated during various processes of the slaughterhouse is directed towards the ETP and it undergoes different processes to reduce the pollutants level in the effluent. Then, the effluent is tested against the pollution parameters and the effluent must have less than the maximum permissible level of the pollution parameters. The effluent must not have more than the permissible maximum level of the pollutants after coming out of ETP before being discharged into the municipal sewage system or some natural water bodies.

Introduction
• The source of contamination of meat plant is largely from the animals entering in the plant
• Severely contaminated hide/skin are the major source of abattoir contamination
• If proper hygiene of employees, equipments and clothing is not followed, then even after skinning 10,000 to 100,000 bacteria/ in2 can be detected
• Blades of knives can carry 80,000 to 40 millions bacterial per blade & hands of meat operative can have 3x109 bacteria/g of scrapings
• The chance of contamination of carcase is greater at the point of incision and minimum at the farthest point from the incision place
‘Scotoma effect’ or ‘factory-blindness’
• Persons working in any factory or abattoir on routine basis slowly and slowly becomes unaware (mentally ‘blind’) about any sub-standard hygiene or cleanliness problem existing in the surrounding
• This effect is known as ‘scotoma’ or ‘factory-blindness’
• Effect can be powerful and the any visitors to that factory or abattoir will instantly notice that sub-standard hygiene or cleanliness problem neglected by the persons working there

Physicochemical parameters of meat
1. Moisture, ash and fat content
• Meat samples are dried at 105 °C for 24 h for determining the moisture content and for ash content analysis, samples are burned at 525 °C
• Fat determination is done by acidic hydrolysis of the sample
• Sample is boiled initially and then cooled and later, it is filtered, washed and dried
• Thereafter, petroleum ether is used to extract the fat
• Ether is evaporated and the remnant is dried and weighed
2. Protein content
• Often, protein in meat sample is estimated using Kjeldahl method
• The protein content is determined by multiplying the nitrogen content in the meat sample by an appropriate conversion factor
• Strong acid is used to digest the meat sample and the released nitrogen is measured by proper titration technique
• Then, the protein quantity of the sample is determined from the nitrogen concentration of the meat
• Kjeldahl method does not determine the protein content in straightway manner; a conversion factor (F) is required to convert the nitrogen content to protein content
• Usually, a conversion factor of 6.25 (corresponding to 0.16 g nitrogen/g of protein) is used for several food samples

Introduction
• The main objective of food preservation is to avoid food spoilage • So, the underlying principle behind all the meat preservation technique is providing adverse conditions for the growth and survival of the harmful microbials and such adverse conditions may be provided in the from of heat, cold, high level of salt, increasing acidity or removal of water/ oxygen
• Meat can be preserved by many techniques such as drying, heating, low temperature, curing, addition of chemicals or by application of irradiation and high pressure
• Addition of chemical i.e. chemical preservation which is accomplished by smoking is generally done after salting and pickling of meat

Introduction
Storage of fresh meat without microbiological degeneration at temperature more than freezing point of meat is known as ‘conditioning’ or ‘ageing’ and it is said to enhance tenderness and flavor of the meat Conditioning is also known as ageing or proteolysis of meat
• In the initial 24–36 h after the slaughter, glycolysis is the prevailing reaction going on during post-mortem
• The organization of the contractile proteins can only be conserved by the constant supply of ATP (energy source)
• But ATP supply becomes scarce with the passage of time after death and denaturation of the proteins starts
• Denaturation is a physical or intramolecular reorganization without involving hydrolysis of the bonds occurring between the various amino acids of the polypeptide proteins chains
• Denaturation is characterized by heightened reactivity of different chemical groups, a modification in molecules shape or size, reduced solubility and lost biological reactivity in cases of enzymes or hormones
• In the course of post-mortem conditioning, proteins are prone for denaturation due to lower pH than in-vivo, temperatures more than 25 °C or less than 0 °C, dehydration and higher non- hysiological salt levels
• Connective tissue proteins such as collagen and elastin do not undergo denaturation during conditioning

Post-mortem glycolysis (anaerobic glycolysis)
• Post-mortem glycolysis is the basic function of muscle
• Irreversible anaerobic glycolysis starts after the animal has died and oxygen supply to the muscles is cut
• The various biochemical steps that occur in living animals for the conversion of glycogen into lactic acid when the oxygen supply is insufficient, are basically similar in slaughtered animal also
• After slaughter, during anaerobic glycolysis in normal animals (not in the animals that are exhausted, excited or excessively exercised just prior to slaughter), the glycogen reserve of the muscle decreases appreciably resulting in the lactic acid production which will proceed to a pH level at which the enzymes involved in glycolysis become inactivated
• In classic mammalian muscles this pH will be near to 5.4–5.5 (called Ultimate pH)
• Muscle having almost 600 mg glycogen/100 g muscle at the time of slaughter will reach this pH
• A protein called glycogenin is responsible for starting the glycogenesis (glycogen synthesis) in muscle and it binds with eight glucose molecules to produce a glycosyl-protein (Fig. 12.1)
• Glycosyl-protein is used as primer by the enzyme proglycogen synthase and thus, proglycogen is formed
• This proglycogen is converted into bigger macromolecule by the macroglycogen synthase and its branching enzyme

Constituents of meat
i. Water- 75%
ii. Protein- 19%
iii. Soluble and non-protein substances- 3.5%
iv. Fat- 2.5%
• The muscle fibre is important unit of muscular tissue consisting of
a) Myofibrils- formed protein structures embedded in sarcoplasmic fluid
b) Sarcoplasmic reticulum- a fine system of tubules
c) Sarcolemma- a very thin membrane surrounding the myofibrils and around the exterior side of this membrane, the connective tissue is found
• 19% of protein in the muscle is muscle fibre (Table 11.1)
• α-alanine, glycine, glutamic acid and histidine are the major free amino acids present in the fresh muscle

Introduction
• Arrival of the nerve stimulus at the motor end plate result in reversal of the polarization of the sarcolemmal surfaces and the muscle gets activated
• This causes momentarily loss of potassium and sodium ions impermeability by the sarcolemma and Ca++ ions combined with calsequestrin in the sarcotubular system gets dissociated bringing Ca++ ion equilibrium with the sarcoplasm
• The junctional foot protein (JFP) and the L-type calcium channel (LTC) are the two big protein complexes responsible for the calcium release mechanism (Fig. 10.1)
• This leads to increase in level of Ca++ ion from nearly 0.10 mM to 10 mM
• Thus, troponin C, the calcium-binding site of the troponin complex becomes saturated bringing a structural modification resulting in interaction of actin with the MgATP2- on the H-meromyosin heads of the myosin molecule as the troponin I, the inhibitory protein, no more inhibits this interaction
• The interaction of actin with the MgATP2- intensely activate contractile ATP-ase near the bonding leading to break down of MgATP2- to MgADP– at a greater rate and liberating energy for inward (towards the sarcomere center) pulling of the actin filament
• This leads to breaking of bond between actin and myosin and thus, the myofibrillar part involved in above mentioned activity gets contracted

Muscle structure
• All muscles are composed of muscle fibres which are the structural unit of muscles
• In turn, every single muscle fibre is made up of numerous smaller components called myofibrils
• Functional unit of myofibril is sarcomere
Connective tissues associated with muscle
• Whole muscle is surrounded by a sheath of connective tissue called epimysium
• Whole muscle is divided into muscle bundles by perimysium formed out of connective tissue septa originating from the interior surface of the epimysium separating the muscle fibres
• The perimysium contains the blood vessels and nerves

Fat
• Utmost significant slaughterhouse byproduct is fat obtained from intestines, kidneys, channel and other offals
• Edible ox fat is rendered and the obtained product is called premier jus (higher grade fat) which is differentiated into oleo oil and oleo stearin
• If all edible ox fat is rendered, it is called dripping and it used for human consumption
• Inedible fat is used for soap manufacturing
• The highest value fat from pig is recovered from peritoneal lining (leaf fat), and the subsequent highest value recovered from back fat, mesentery and omentum
• Sheep fat is separated into oleo oil and oleo stearin because of its strong flavour
• Mutton fat is harder and its stearin content is more than ox or pig and therefore, it is applied on the top of meat paste glass jar as a protective layer
Rendering of edible fat
Three principal procedure of rendering of edible fat are:
i. Wet rendering
ii. Dry rendering
iii. Continuous low-temperature rendering

Introduction
• Slaughtering of meat animals in way so as to effect minimum pain and suffering to animals is referred as humane slaughter
• Slaughtering method followed should inflict least stress and suffering to the animals
• There are acceptable and the unacceptable slaughtering methods and there is no ‘nice’ method to slaughter the food animals
• In advanced countries, common slaughtering method consists of two steps, stunning and bleeding
• Stunning is done to make animal unconscious and not to feel the pain during actual bleeding process which is followed next
• Exception of stunning-- Jewish and Muslim methods of slaughter
Stunning
Humane slaughter consists of stunning followed by sticking (bleeding). Stunning is the process of making the animal unconscious till it is slaughtered so that the pain suffered during actual act of slaughtering can be alleviated

Post-mortem (PM) examination
The core objective of post-mortem examination is to identify and eradicate defects and contaminations and thus, confirming that only meat suitable for ingestion are allowed to be passed
Facilities for post-mortem inspection
• Normal infrastructure amenities which delivers comfortable working environment and assist in presenting the carcases and its offals for PM examination
• Every inspection place on the dressing over-head line must have lights of -- 540 lux (50 foot-candle) intensity light which does not alter the normal colours
• Adequate facility for sanitising the hands, equipments and aprons should be provided
• To sterilise the knives, cleavers and saws–a water bath operating at 82 ºC
• Head, viscera and carcase are the three major inspection parts
• On moving rails, viscera from a particular animal should move little ahead of its carcase so that any abnormality in viscera could be conveyed to the carcase examiner well in time
• For precise recognition of carcases and its correlated viscera from an animal, the lines conveying the carcases and viscera should move in synchronized way
• When a carcase is declared unfit for human consumption, all its the related parts such as head, viscera, blood and hide must be collected and disposed off
• Every inspection point must have a easily accessible overhead rail line stop button

Introduction
• Meat inspection involves proper veterinary examination of live food animals prior to slaughter (called ante-mortem examination), inspection of carcases and offals and pathological examinations where deemed fit
• Full ante-mortem inspection represents 50% of meat inspection
• Ante-mortem inspection is particularly useful for detecting scheduled or infectious diseases which are communicable to man e.g. anthrax, rabies and glanders
• Diseases where animals show nervous symptoms like tetanus, tuberculous meningitis, sturdy in sheep, lysteriosis, rabies, cysticosis etc. and where skin lesions are manifested such as food and mouth disease, swine fever etc. are easily detected during ante-mortem inspection which are difficult to be detected in post-mortem inspection
• Animals must undergo veterinary ante-mortem inspection on the day of their arrival at the slaughterhouse or before the beginning of daily slaughtering
The inspection must determine
1. Whether the animals are suffering from a disease which is communicableto man and to animals or whether they show symptoms
2. Whether they show symptoms of disease or of a disorder of their general condition which is likely to make their meat unfit for human consumption-- any medicine/substances
3. Whether they are tired, agitated or injured
4. Whether they are sufficiently clean to enter the normal slaughter protocol
• For public health purposes, the veterinarian must separate normal animals from those which may be suffering from a potentially zoonotic disease or present a hygiene risk to the slaughter hall environment owing to the soiled condition of their hide/fleece

Introduction: Relation between transportation and meat quality
One of the fundamental aims of animal production system is to ensure better quality meat. Apart from various animal husbandry practices that affect the meat quality, the transportation of meat animals from farm to slaughterhouse and their handling at lairage, affect the meat quality greatly. For better meat quality, the pH of the meat should fall from normal pH 7.0 - 7.2 in live animal to pH 5.5 (ultimate pH) after slaughter at the onset of rigor-mortis. The low muscle pH is required to inhibit the microbial growth and meat tenderization (cathepsins system is activated at low pH). The ultimate muscle pH is achieved through the accumulation of lactic acid which is produced as a result of anaerobic glycolysis of glycogen. After slaughter, as the oxygen supply to muscle ceases, ATP is generated through anaerobic glycolysis of glycogen and in this process lactic acid is produced. ATP is required to keep the muscle in relaxed stage. This anaerobic glycolysis carries on till the glycogen reserve is exhausted. So, higher the glycogen reserve at the time of slaughter, longer the length of time duration of anaerobic glycolysis and higher the quantity of lactic acid production and greater the reduction of muscle pH. Hence, livestock should be transported and handled before slaughter carefully because stress during transit and in lairage could severely deplete the glycogen reserve of livestock.
The following facts should be especially taken care by the farmers raising livestocks for meat
1. Housing arrangement and design
• Any flaws/deficiencies in design, layout, cubicle size and its design, drainage, water bowls, slats, air circulation, etc. should be rectified

Facilities required for buffalo, sheep and goat slaughterhouses
1. Lairage
2. Large enough slaughterhouse area-
• Separate area for pig slaughtering
• Slaughter line and area for operations such as singeing, depilation, scraping should be demarcated by a high wall of at least 3 m high or by an open space of 5 m width
3. For stomachs and intestines emptying and cleaning, there should be one dedicated room
4. Separate rooms for handling guts and tripe
5. Fat and hides, hooves and horns should be stored in separate rooms
6. Accommodation for sick or suspected animals; detained meat or seized meat
7. Chilling/refrigeration room
8. Room for veterinary services
9. Provisions for lavatories, wash basins, changing rooms, and showers
10. Facilities for veterinary inspection
11. Entry and exit of slaughterhouse should have control mechanism
12. Separation of clean and unclean area
13. Waterproof flooring of room where meat is processed
14. Provision for steam exhaustion and sufficient ventilation
15. Sufficient artificial or natural lighting
16. Adequate potable water supply
17. Adequate hot potable water supply
18. Effluent treatment plant (ETP)

• The proportion of bone varies depending on breed and body condition from 12 to 28% in the dressed carcase and approximately 15% in a good large ruminants carcase
• Bone percentage increases with the age and weight of the animal and it is lowest in Aberdeen Angus cattle and it may increase to 28% in low quality large ruminants
• The average bone % in bobby calves is 50%, veal calves 25%, in lamb 17–35%, in pork 12–20% and in poultry 8–17% Important parts of digestive system of meat animals Ox tongue
• Filiform papillae found on the tongue are pointing backward and horny and thus, helps in food prehension
• Actinobacillosis erodes the prominent posterior part of the tongue dorsum
• 10–14 circumvallate papillae are spread in the region of prominent dorsum around the either side of the tongue midline
• Black pigmentation of the tongue surface is fairly normal and not associated with any disease condition
Sheep and goat tongue
• Similar to cattle tongue
• However, papillae are not horny but the centre of the tip is slightly grooved
• Black pigmentation of the surface of the tongue is common in blackskinned sheep.

Introduction
Generally, muscles and offals obtained from animals feeding on grass and various other cultivated crops are regarded as meat. Apart from the meat obtained from the cattle, sheep, goat, pig and poultry, in many countries particularly Denmark, Belgium, Holland and Germany, horse meat is also consumed (hippophasia) as normal meat. Kangaroos are slaughtered for meat in Australia whereas capybara a large semi-aquatic vegetarian rodent, is used in South America as of one of the meat source. Dog meat (fragrant) is relished (Kinophasia) in few cultures such as South Korea, China, Vietnam and few north eastern states of India.
In many parts of the world including Indian subcontinent, buffalo meat (Bubalus bubalis), also known as water buffalo or arna, is quite popular owing to its tenderness, leanness and low cholesterol qualities. It is distributed in many countries around the world such as India (largest population), Pakistan, China, Bangladesh, Indonesia, Philippines, Hungary, Italy and France etc. Bison (Bison bison) from North America is also called buffalo but they are separate species of the order Bovidae. Rabbits are also source of meat having higher growth rate and better feed conversion ratio (2:1). Elands are another meat source which are raised in Africa and Russia for meat purpose.
Meat is quite high in protein content but the presence of saturated fat is perceived negatively due to its association in various cardiovascular diseases, diabetes etc. Efforts are made to produce lean meat having higher content of unsaturated fatty acids and to reduce the ω-6 to ω -3 fatty acids ratio.

Abstract
Legumes are an excellent group of fertility restorer crops which can be grown either as sole crop or as a component crop in the cropping system. As they are tolerant to drought condition, they can be grown throughout the year. The yield of legume crop is largely depending on pest, diseases and weeds. Among these weeds plays a major role as the weed seed bank inside the soil influence the weed population in the cropping season. Hence it is important to manage the weed seed bank for better productivity of legumes. Though legumes are short duration and fast growing crops, the germination percentage of weed seed bank will determine the final yield of legumes. There are many strategies to which the weed seed bank can be controlled to tolerable level before which the weed seed bank present in the soil has to estimate. Annual weed seed bank can be minimized by killing the weeds before they set seeds, harvest weeds, crop rotation, cover crops, inter cropping and ensiling. Weed seed bank depletion can be done by tillage, tricking the weed seeds, conditioning weed seeds, soil solarisation and herbicide application. Thus integrating various technologies may help in effective controlling of weed seeds to tolerable level thereby enhancing the yield of leguminous crops.

Abstract
India shares one fourth of global annual grain legume production and is also largest consumer of it. Weeds are the most severe and widespread biological constraint on agricultural production systems and cause damage to cropped and non-cropped lands. They reduce crop yield and degrade the quality of the produce, besides raising the cost of production. The grain legumesare commonly grown under rainfed/dry land conditions and hence do not receive the best management practices that are required for maximization of crop productivity. Among various production inputs, weed management was found to be the most important one contributing about 31% in pigeon pea, 110% in urdbean and 60 % in mungbean towards total productivity. Effective weed management in grain legumes is essential for optimizing
crop yield and quality. This process involves a multi-faceted approach that integrates cultural, mechanical, and chemical methods to address the challenges posed by diverse weed species and varying environmental conditions. Traditional single-method approaches often fall short due to the complexity and variability of weed problems like development of resistance in weeds. Therefore, an integrated weed management approach becomes effective, combining timely interventions with adaptive strategies to manage weed competition throughout the growing season. This approach not only enhances crop competitiveness and yield but also offers economic and environmental benefits by reducing reliance on broad-spectrum herbicides and promoting sustainable practices. Continuous monitoring and adjustment
of weed management strategies are crucial to effectively tackle evolving weed populations and changing conditions, ensuring long-term success in grain legume cultivation.

Abstract
Food insecurity and malnutrition are on the rise globally, impacting millions, especially in rural regions where extreme poverty and food insecurity are deeply rooted. Vulnerable groups, including women, youth, and indigenous peoples, are disproportionately affected. Producing foo  that meets dietary needs and ensuring its availability in the future is essential for sustainable development and food sustainability. Addressing the growing global food security concerns and supporting the increasing population requires the continual expansion of plant-based proteins’ significance. Legumes are excellent sources of proteins, carbohydrates, and both soluble and insoluble dietary fibers. Legumes, with their high dietary fiber and low-fat content, help maintain body weight and lower the risk of cardiovascular disease. They are also rich in essential minerals such as potassium, calcium, magnesium, phosphorus, and iron, and provide important vitamins like folate, thiamine (B1), riboflavin (B2), and niacin (B3). Additionally, pulses contain various phytochemicals, including phenolics, flavonoids, phytates, lectins, tannins, saponins, oxalates, enzyme inhibitors, phytosterols, and antimicrobial peptides, which offer numerous potential health benefits. These phytochemicals exhibit anti-inflammatory, anticancer, antimicrobial, and anti-ulcerative properties. Incorporating legumes into agricultural systems can foster more sustainable and climate-resilient farming practices. In developing countries, legumes are often used to supplement cereals or starchy foods to combat protein-energy malnutrition, as animal proteins tend to be expensive in these regions.

Despite advances in agriculture, malnutrition remains a widespread issue, affecting millions, especially in developing countries. Protein-energy malnutrition, which affects over 170 million children and women, poses a significant threat to national economic development, increasing healthcare costs and reducing productivity. One key solution to combating malnutrition lies in promoting legumes (pulses), which are nutrient-dense, protein-rich, and vital for both human and animal consumption. Pulses have been a staple in diets
for centuries, providing essential nutrients like protein, fiber, vitamins, and minerals. They are not only beneficial for human health, reducing the risk of heart disease, diabetes, and cancer, but they also contribute to sustainable agriculture. Legumes can fix atmospheric nitrogen, reducing the need for synthetic fertilizers, improving soil health, and increasing agricultural productivity. However, despite their benefits, pulse production lags behind other staple crops like cereals. With proper management, legumes could play a vital role in alleviating global hunger, particularly in developing countries. Increased awareness and efforts to incorporate legumes into farming systems and daily diets could help meet the growing global demand for nutritious, sustainable food.

Grain legumes, including peas, beans, lentils, and chickpeas, are vital for global food security and soil health due to their protein content and nitrogen-fixing capabilities. However, their productivity is often threatened by pests, diseases, and weeds. Legumes offer a sustainable solution by reducing greenhouse gas emissions, as they produce 5-7 times less gases per unit area compared to other crops. They aid in carbon sequestration, with soil carbon estimates of 7.21 g kg-1 of dry matter, and save fossil energy by decreasing nitrogen fertilizer use, reducing CO2 emissions by 277 kg ha-1 per year. Legumes play a key role in low-emission farming systems due to their ability to fix atmospheric nitrogen, reducing dependence on energy-intensive synthetic fertilizers. The rapid increase in global food demand, driven by fast population growth, has made it challenging to provide nutritionally balanced diets. Pulses offer a promising solution to these challenges by delivering significant nutritional and physiological benefits. Pulses such as chickpeas, green gram, peas, horse gram, beans, lentils, black gram, and others are excellent sources of protein (190-260 g kg−1), carbohydrates (600-630 g kg−1), dietary fibers, and bioactive compounds. The phytochemicals found in pulses, including flavonoids, phenolics, tannins, phytates, saponins, oxalates, peptides, and enzyme inhibitors, offer numerous health benefits. Pulses, essential to human diets for centuries, have seen historically low consumption levels due to underappreciation of their nutritional value. Recognizing their significance, the United Nations designated 10 February as World Pulses Day, and declared the year, 2016 as International Year of Pulses emphasizing their role in promoting healthy diets, sustainable food production, and food security. India is the largest producer of pulses in the world accounting for 25% of the global pulse production. The production and productivity of pulses have slightly decreased due to great emphasis to rice and wheat crops. To boost pulse production, India has implemented initiatives like the National Food Security Mission and policies to support farmers, including Minimum Support Prices (MSP) and welfare schemes integrating pulses. These efforts aim to enhance pulse cultivation, ensure food security, and improve farmer incomes, addressing the demand-supply gap and declining per capita availability of pulses.

Pulses are the second most important food crop after cereals and an important source of proteins, vitamins, and minerals. Pulses are popularly known as “Poor man’s meat” and “Rich man’s vegetable”. Pulses contain a high amount of protein (20-25%), which is almost double and triple of the protein content of wheat and rice, respectively and so can contribute significantly to the nutritional security of the country. Abstract
Understanding genetic diversity is essential for achieving genetic improvement and conservation of grain legumes. These crops serve as important pulses grown and consumed all over the world, especially in Africa, South East Asia and America. Legumes serve as a good source of carbohydrates, oil, fibre and proteins. Grain legumes are a major source of food and nutrition globally. However, it has not been possible to enhance gain legume production to the required level, primarily due to the narrow genetic base of most of the legume crops, coupled with changing climatic conditions. Most grain legumes are lacking in desired plant ideotypes and resistance sources for various biotic and abiotic stresses. The genetic diversity conserved in gene banks globally is a major resource for crop breeding programs, but it
is utilized only marginally. Therefore, in order to broaden the genetic base of grain legume crops and enhance the genetic gains made in improvement programs, conventional approaches and modern scientific tools should be integrated in a phased and carefully judged manner. The first phase should focus on the search for desired traits and the infusion of diversity into the cultivated gene pool through use of landraces and CWRs. The second phase should focus on the utilization of advanced selection tools, such as genomics, high-throughput precision phenotyping, and artificial intelligence, to exploit the hidden potential of the available genetic diversity; and the third phase should involve technologies such as mutational breeding, genome editing, and transgenic technologies to improve, modify any novel or alien traits that are not available in the entire crop gene pool. We presume that enrichment of the genetic diversity of cultivated grain legume gene pools, along with simultaneous improvements in their yield and plant type with the aid of advanced scientific tools, will enhance grain legume crop yields to the required level.

Global food production needs to double by 50% by the middle of the 21st century to ensure food and nutritional security for 9 billion people. Climate change, particularly atmospheric CO2 and temperature, has a complex impact on sustainable food security. Climate change is a significant constraint on legume production globally, which is a crucial food, feed, and fodder source. Legumes fix atmospheric nitrogen through bacteria in root nodules, reducing greenhouse gas emissions and boosting soil C-sequestration. Climate change positively impacts grain legumes by allowing them to allocate above-ground
photosynthates into below-ground parts (nodules), improving rhizospheres’ activities, plant biomass and nutrient use efficacy. However, temperature can also negatively affect grain legumes, leading to flower abortion and abnormal pod filling. However, climate models predict more extreme events in the future, affecting legume growth and development. Heat stress, elevated CO2 concentration, drought, and rainfall variability impact legume crop production, requiring adaptation options. Results show that legumes with C3 fixation pathways show higher photosynthesis, reduced photorespiration, biomass production, and water use efficiency under atmospheric CO2. However, temperature increases lead to faster development, shorter life cycles, and lower yields. Legumes can cope with atmospheric CO2 up to
1000 ppm by storing sucrose and starch. Protein synthesis and water stress also help legumes adapt to changing climates. To achieve targeted yields in changing climatic conditions, agronomic and genetic interventions must be integrated. Targeted breeding programs should select high-yielding, biotic stress-resistant, and abiotic stress-tolerant genotypes adapted to atmospheric CO2 and temperature conditions. Integrating grain legumes with desirable traits can provide resilience against climate change.

These beverages promote milk consumption by offering a flavorful alternative to plain milk, especially for those who are reluctant to drink regular milk. Studies showed that providing flavored milk in schools significantly boosts milk intake, thereby enhancing the consumption of essential nutrients like calcium, protein, and vitamins among children.

These machines use vacuum-operated devices to gently extract milk from cows’ teats without causing discomfort. The collected milk is immediately transferred into refrigerated tanks to maintain its freshness and prevent bacterial growth. Speed and efficiency in transporting milk to processing facilities are critical to ensuring its safety and quality.
At the processing plant, milk undergoes standardization, an essential step where the fat content is adjusted to produce different types of milk, such as whole milk, toned milk, double-toned milk, and skimmed milk. This ensures uniformity in fat levels, meeting market specifications and regulatory standards such as prescribed by FSSAI in case of India.
The milk then undergoes pasteurization, a process of heating it to a specific temperature for a defined period to eliminate harmful bacteria while preserving its nutritional value. Pasteurization has significantly improved milk safety, reduced health risks, and extended its shelf life. Following this, the milk is homogenized, where fat molecules are evenly distributed to prevent cream separation. This centres a smooth texture and consistent flavor preferred by consumers.

Sterilization is a thermal process aimed at destroying all microorganisms and microbial spores in milk, ensuring the product is microbiologically safe and shelf-stable at room temperature for extended periods. It is primarily used in the production of sterilized milk and evaporated milk, with typical conditions involving heating at 116°C for 15 minutes. This process kills all microorganisms and also inactivates all milk enzymes, including plasmin, which might otherwise contribute to spoilage during storage. However, enzymes produced by psychrotrophic bacteria should not be present in raw milk, as they are highly heat-stable and may remain active even after sterilization. Sterilized milk can be stored at room temperature for longer period. Sterilization kills all microorganisms and inactivates all microbial spores that may germinate under the storage conditions of the product in the market.
The Food Safety and Standards Authority of India (FSSAI) define “sterilization” in relation to milk and milk products as the process of heating the product in a sealed container continuously to at least 115°C for 15 minutes. This treatment ensures that the milk can be preserved at room temperature for a period of not less than 30 days.
In-bottle sterilised milk is a shelf-stable dairy product produced by sealing milk in glass bottles and subjecting it to high-temperature heat treatment. Typically, the milk is heated to temperatures ranging from 110°C to 121°C for 15 to 30 minutes. This process effectively destroys all vegetative microorganisms and bacterial spores, making the milk microbiologically safe and extending its shelf life up to 6–9 months without refrigeration. The heating is usually done in batch retorts or autoclaves after the milk has been bottled and sealed. Although the process ensures safety, it often leads to a slight cooked flavour and some nutritional losses, particularly in heat-sensitive vitamins such as vitamin B1 and vitamin C.

Introduction and Relevance
UHT processing of milk was developed to produce a shelf-stable product with minimal chemical changes as encountered with sterilized milk. Aseptically packaged UHT milk can have a shelf life of 06 to 12 months and does not need to be stored in a refrigerator. Its role in the market varies by region. In countries like the India, USA and Canada, where UHT milk occupies a smaller segment of the liquid milk market, it is often used as a backup option, reserved for situations when pasteurized milk is unavailable. Conversely, in regions such as Europe, (particularly France, Belgium, Spain and Germany), Asia, (China, Japan, Thailand and Vietnam) Latin America and (Brazil) in UHT milk is the dominant form of milk available and is consumed regularly. In markets where it is a backup option, UHT milk requires long-term stability of 6–12 months, while in regions where it is used daily, a shorter shelf life of three months or less is often sufficient.
Ultra-High Temperature (UHT) treatment involves heating milk to very high temperatures, typically between 130°C and 150°C, for a brief period of few seconds. This process results in commercially sterile milk, meaning that while not all bacteria are destroyed, those capable of growing under ambient storage conditions are effectively eliminated. An essential component of UHT processing is aseptic packaging, where the sterilized milk is filled into presterilized containers in a sterile environment. This combination ensures that the milk remains free from contamination and maintains its extended shelf life without requiring refrigeration.
Standards for UHT processing vary globally. In the European Union, a minimum temperature of 135°C with an appropriate holding time is mandated. In the United States, the standard for ultra-pasteurization is 280°F (137.8°C) for 2 seconds. Many international standards recommend 135°C for at least 1 second, though some countries do not specify minimum conditions. However, this level of treatment is often regarded as insufficient for completely destroying the spores of spoilage organisms, highlighting the importance of precise temperature-time combinations and the critical role of aseptic packaging in ensuring product safety and stability.

Introduction
Heat treatment is the most commonly used method in the dairy industry for milk processing. Its primary objective is to eliminate pathogens and reduce spoilage-causing organisms, ensuring milk is safe for consumption and has a longer shelf life. While advanced methods like high-pressure processing, pulsed electric fields, ultrasound processing, cold plasma treatment, and ultraviolet sterilization have emerged, heat treatment remains the preferred choice due to its simplicity, reliability, and proven effectiveness. All dairy products undergo some form of heating during processing, whether through pasteurization, sub-pasteurization (e.g., for milk used in aged cheeses), or sterilization. To facilitate this, liquid heating systems such as continuous heat exchangers or jacketed tanks are widely used, typically powered by steam or steam-heated water. Consequently, steam generation boilers are a standard feature in almost all dairy processing facilities.
The Key Objectives of Heat Treatment Include
1. Elimination of harmful pathogens in milk, ensuring it is safe for consumption and protecting public health.
2. Increasing the keeping quality of milk by reducing the number of spoilage organisms.
3. Inactivating enzymes naturally present in milk or secreted by microorganisms to prevent enzymatic degradation.
4. Preventing the autoxidation of lipids, which can lead to off-flavors and spoilage.
5. Inactivating agglutinin to reduce rapid creaming and maintain uniform consistency.
6. Enhancing the growth of starter cultures by eliminating natural inhibitors and dissolved oxygen in milk, essential for producing cheese and fermented products.

Homogenization is now a widely used industrial process in dairy production, essential for stabilizing milk and other liquid dairy products. Its main purpose is to prevent fat from separating out of the milk, ensuring a smooth, consistent, and uniform product. Milk is a complex emulsion comprising water, fat, proteins, carbohydrates, minerals, and vitamins. Among these constituents, fat plays a critical role in determining the texture, flavor, and overall sensory quality of milk and dairy products. In its natural state, milk fat exists in the form of globules of varying sizes, surrounded by a thin membrane that stabilizes them in the aqueous phase. These fat globules typically range in size from 2 to 10 μm and have a lower density than the surrounding water-based phase of milk. This difference in density causes the fat globules to rise and form a cream layer when milk is left undisturbed, leading to an uneven texture and separation during storage.
Homogenization is a mechanical process applied to milk to modify fat globules by forcing the milk under high pressure through a tiny orifice. This reduces the average size of the fat globules while increasing their number and surface area. Practically, this greatly minimizes the tendency of fat globules to rise and form a cream layer. The enhanced stability of homogenized milk is due to three key factors: the reduction in the average diameter of fat globules, as described by Stokes’ Law, which slows their upward movement; the uniformity in size distribution, which ensures globules rise at similar speeds, preventing clustering; and the increased density of fat globules caused by the adsorption of a protein membrane, bringing their density closer to that of the surrounding liquid. Additionally, heat pasteurization complements homogenization by breaking down the cryo-globulin complex, which otherwise promotes clustering and cream formation.
The smaller and uniformly dispersed fat globules create a smoother, creamier texture and enhance the mouthfeel. This process also contributes to the visual appeal of milk, making it appear whiter and more uniform. Homogenization is, therefore, an essential step in modern dairy processing, ensuring the stability, quality, and consistency of milk and other dairy products, while addressing the challenges posed by the inherent properties of milk fat and its lower density.

Introduction
Milk reception at the processing plant is a crucial stage in the dairy supply chain, as it serves as the first point of quality control and the gateway to further processing. The success of milk processing hinges on the careful handling, evaluation, and preparation of the raw milk upon arrival. The stringent protocols at reception ensure that only high-quality raw milk enters the system. By implementing advanced technology, strict hygienic standards, and efficient handling practices, processing plants can maintain milk’s safety and quality, setting the foundation for the production of superior quality dairy products. The intricate procedures at this stage safeguard consumers' trust and ensure compliance with regulatory requirements.
Milk is transported to dairy plants either in cans or in road/rail tankers. The designated area within the dairy plant where milk is first received, inspected, and graded for acceptance is referred to as the milk reception dock, platform, or raw milk receiving dock (RMRD). This reception dock is specifically designed and equipped to ensure the efficient handling of milk, enabling its swift unloading while also accommodating the cleaning and sterilization of used containers.
Since the quality of milk is a critical factor for its subsequent processing, the decision to accept or reject milk must be made promptly upon its arrival, following a thorough evaluation. The milk reception process should be meticulously planned, and the equipment must be selected to ensure efficient intake operations, particularly in facilities handling large milk volumes. Any delay can result in deterioration of milk before unloading, increased labour requirements, and higher operating costs. To avoid such issues, milk deliveries should adhere to a strict schedule, and the reception process should be completed within a stipulated time frame of time. This ensures seamless continuity of the dairy plant operations.

Preservation of raw milk is essential to maintain its quality during storage and transportation before processing. One of the primary methods for extending its storage life is refrigeration, where milk is cooled to 2°C to 4°C immediately after milking. This significantly slows down the microbial growth and enzymatic activity. Bulk milk coolers (BMCs) are vital in achieving rapid cooling, especially in collection centres or dairy farms, where they ensure that milk remains fresh during storage and transportation. BMCs are particularly essential for regions with inadequate cold chain infrastructure, as they help maintain milk quality until it reaches processing facilities.
In addition to refrigeration, thermisation is another method used to preserve raw milk. Thermisation, a mild heat treatment, is widely used to extend the shelf life of raw milk, particularly when it needs to be transported over long distances. This process involves heating the milk to 57–68°C for 15 seconds, effectively reducing the microbial load while preserving the milk’s natural characteristics. Thermisation is typically followed by refrigerated storage, where milk is cooled to temperatures between 2° and 4°C to inhibit further microbial growth. The combination of thermisation and refrigeration ensures that milk retains its freshness and safety until it reaches processing facilities, even in regions with extended supply chains.
Raw milk also benefits from its natural inhibitors, such as lactoperoxidase, lactoferrin, and immunoglobulins, which exhibit antimicrobial properties and slow down bacterial growth. The lactoperoxidase system, for instance, can be activated by adding small amounts of hydrogen peroxide and thiocyanate to enhance milk’s preservation in the absence of refrigeration. The use of chemicals like hydrogen peroxide (H2O2) for milk preservation is not permitted in India due to safety and quality concerns. However, the FAO recommends its application under strict regulatory conditions in some countries as part of the lactoperoxidase system, particularly in regions where refrigeration is unavailable.

Similar to the procurement of raw materials in a factory, milk collection is one of the initial and essential steps for a milk processing or marketing company. A successful milk collection system combines efficient route planning, quality control, and effective farmer engagement. By prioritizing technology integration, cold chain management, and regulatory compliance, dairy companies can establish a reliable and sustainable milk procurement system that meets both operational and quality standards.
India dairy sector depends on smallholder individual milk producers, each contributing between one to a few litres of milk per day. Typically, milk production takes place in rural areas, while the demand is concentrated in urban centres. However, rural producers often face significant marketing challenges due to the dispersed nature of milk production, scattered settlements, and inadequate supply infrastructure. Therefore, milk needs to be collected, transported, and marketed from villages to cities to ensure profitable returns for producers. Milk is usually collected from producers at designated collection points in rural areas, which serve a large number of small suppliers. This approach minimizes the need for individual chilling and storage facilities. Collection points should follow the same hygiene standards as dairy processing facilities. Milk should arrive at a chilling station within four hours of milking, especially in warmer climates. There, it must be quickly cooled to below 4°C to preserve its quality. Bulk milk coolers of required capacity are installed for the chilling and storage of milk at low temperature till it is transported to the processing plant.

Dairy Industry in India
Milk holds a deeply symbolic place in Indian culture, far beyond its role as a mere food item. It is intricately woven into the cultural and historical identity of the nation, with the dairy industry serving as a cornerstone of India’s economy. The sector is a driving force behind rural development providing a crucial pathway to prosperity for millions of small-scale farmers. It plays a significant role in alleviating poverty and generating employment opportunities. The dairy sector by empowering farmers, developing modern infrastructure embracing technological advancements, and promoting sustainable practices, fostering widespread socio-economic progress in rural India. In the 1920s, modern milk processing and marketing technologies were introduced in India. The National Dairy Development Board (NDDB; founded in 1965), implemented Operation Flood (1970-96) to modernize the dairy sector through cooperatives. This led to the rise of dairy cooperatives countering the exploitation by private milk plants. The cooperatives followed the Anand model, a three-tier structure comprising village-level societies (producers), district-level unions (milk collection and processing), and state-level federations (marketing). Originating in Anand, Gujarat in 1946, the model was later adopted nationwide. The progress termed as White Revolution transformed India from a nation struggling with milk shortages into the world’s largest producer and consumer of milk. By 1997, India became the global leader in milk production with a volume of 70.9 million tons, surpassing the United States (FAO data rearranged by Our World in Data). Further in the year 2014, for the first time, it beat the entire European Union. Since 1950, India’s milk production has seen tremendous growth, rising from 17 million tonnes in 1950-51 to 230.58 million tonnes in 2022-23. The per capita availability of milk increased from 124 g/day in 1950-51 (PIB 2022) to 459 g/day in India during.

Modern fruit and vegetable processing industry is by and large, employing sophisticated machinery and equipment and efficient technique of production. There is still a scope for expansion of the industry by developing and exporting value-added products and on more foreign exchange. The choice of products to be manufactured will depend on the readily availability of raw materials in the area where the Processing Unit is supposed to be set up and the consumer preference in the neighbouring market. Preservation of food has to be established in the developing countries for other reasons also such as to generate both rural and urban employment, improve farmers nutrition by allowing them to consume their own processed fruits and vegetables during the off- season, stimulate agricultural production by obtaining marketable products, reduction of imports and meeting of export demand and to develop new value-added products. The food processing industry has now become more of a necessity than being a luxury. It plays an important role in the conservation and better utilisation of fruits and vegetables. To avoid the glut and utilise the surplus during the season, it is necessary to employ modern methods to extend storage life for better distribution and processing techniques to preserve them for utilisation in the off season on both large scale and small scale. Fruit and vegetable processing was first started in an organised manner in 1857, mainly to make pickles and chutneys with a view to meeting the export requirement.
Mango Processing Technologies
Mangoes are processed at two stages of maturity. Green fruit is used to make chutney, pickles, curries and dehydrated products. The green fruit should be freshly picked from the tree. Fruit that is bruised, damaged, or that has prematurely fallen to the ground should not be used.

Pectin
Pectin is a component of nearly all fruits and vegetables and can be extracted and used in food processing to form the characteristic gel in jams and marmalade. The richest sources of pectin are the peels of citrus fruits such as lime, lemon, orange and passion fruit or the pulp of apple (known as ‘pomace’ after juice has been extracted). Commercially, pectin is available as either a light brown powder or as a dark liquid concentrate. It is stable if stored in cool, dry place and it will lose only about 2 per cent of its gelling power per year.
There are two main types of pectin:
• High methoxyl (HM) pectin that form gels in high solids jams (above 55% solids) in a pH range of 2.0-3.5; and
• Low methoxyl (LM) pectin, which do not need sugar or acid to form a gel, but instead use calcium salts.
